As much as they are "drink everyday" wines, they also have the magic power of putting a smile on everyone's face.  “Yet, for that really special wine, I plan on opening a bottle of Chambolle-Musigny Premier Cru Les Amoureuses 2001 from Domaine Jacques-Frédéric Mugnier. Chambolle-Musigny is among my favorite villages in Burgundy and the Amoureuses vineyard could easily make a case to be classified as Grand Cru. It combines the perfume, texture, elegance and persistence typical of the very best red Burgundy. The style of Domaine Mugnier is one of refinement and grace. And with 20-plus years’ age, it should be perfect for drinking now. Even though it will accompany a roast chicken, this wine is like a celebration and a meal in and of itself.”  2018 Klein Constantia Vin de Constance – chosen by Jeffrey Koren, Head of Wine at Marceline, London  “While it’s easy to open a perfunctory bottle of Port or Sauternes at the end of a Christmas meal, the oh-so-delicious Vin de Constance by Klein Constantia has become my go-to sweet wine for the festive period over the past few years. Steeped in history, Vin de Constance was famously a favourite of Napoleon and lauded by authors like Jane Austen and Baudelaire. These days, winemaker Matt Day has revived this legendary dessert wine to its former acclaim. It always offers wonderful notes of apricot, honey and spice. But most importantly, it’s balanced by refreshing acidity that is an absolute necessity after an indulgent holiday meal.”  Hauller Frères Pinot Gris La Chappelle Signature – chosen by Joséphine Duffau-Lagarrosse, Ch. Beauséjour   “Ludovic Hauller is a long-standing friend I met during my studies in Burgundy. I appreciate the precision that his family channels into the wines, and this cuvée showcases great finesse, with freshness and elegance, mirroring the granite terroir in which the vines grow. It’s a Pinot Gris of remarkable complexity, hailing from a plot that sits below the Chapelle Saint-Sébastien de Dambach-la-Ville. Ludovic introduced me to Alsatian wines, which I knew little of previously, and I love this cuvée. As for when, this is definitely the kind of bottle I would open in the days following Christmas, with my family, playing board games by the fire and putting the world to rights, patiently waiting for the New Year!”  2002 Champagne Salon, Giuseppe Mascarello’s 2017 Barolo Villero, Tiberio’s 2018 Colle Vota – chosen by Lorenza Sebasti, Castello di Ama  “As usual, this Christmas we will open a magnum of 2002 Champagne Salon. I remember we had the chance to buy a few magnums a long time ago as they were precisely the birth years of our children (1997, 1999 and 2002). Then I guess I will spoil everyone at home with a beautiful Barolo Giuseppe Mascarello Villero 2017 and Colle Vota Montepulciano d’Abruzzo 2018 from my dear friend Cristiana Tiberio. She makes very few bottles of this very elegant and vibrant wine, which is among my favourite reds.”  2021 La Morandina Moscato d’Asti – chosen by Donald Edwards, Head Sommelier at La Trompette, London  “Beyond the best white Burgundy I can lay my grubby mits on, I’ll be cracking the second bottle on a case of La Morandina’s 2021 Moscato d’Asti – part of a new festive tradition. Back when my wine appreciation was still protean, I heard a rumour that Moscato d’Asti – the sweet fizzy floral stuff that we sold in my Glasgow Oddbins – ages magnificently. Twenty or so years later, I’m the Head Sommelier at La Trompette, hosting a big Piedmont-themed wine lunch. Barolos and Barbarescos aplenty litter the room, but the wine that stops me in my tracks? A 2013 Moscato d’Asti from Giuseppe Vajra. It was phenomenal, still gleefully tasty, but now with a touch of extra weight, more waxy lime skin and late-evening summer flowers, heady in its bouquet. Here she was, my white whale, and, boy, she didn’t disappoint.  “Last December, visiting La Morandina in Asti, I asked whether they had anything with a bit of age and lo! a 15-year-old magnum appeared. My stars had aligned for a second time – the wine equally lovely, offering a bit more exotic spice, cardamom and coriander seed along with the sweet creamy lime zest. Crucially, this time I could see the germ of a plan. Each year, I would buy a cast of Moscato d’Asti, building a reserve of Moscato to steadily enjoy over the coming years. I’ll be the Christmas king of deliciously sweet floral fizz. So, on the morning of 25th, I’ll be twisting the top off the second bottle from last year’s case and smugly enjoying my Moscato and crumpet as I let my mind wander over the riches I’m preparing for the coming years.”  François Cotat Sancerre Le Mont Damné and Massican Gemina – chosen by Alex Sarovich, Founder and CEO of Own Rooted Hospitality  "As the oldest of five in a large Italian family, I've learned that selecting the perfect wine is an art form that requires careful consideration of both the food and the audience. Then last, a bottle of Côte-Rôtie La Landonne by Jean-Michel Gérin. Anyone who’s had the misfortune of tasting a de-alcoholised version knows that alcohol is key to wine. Take it away and it leaves a gaping void in the glass – stripping the liquid of body and flavour. Those attempting to craft alcohol-free alternatives look to make up for its absence with sugar or flavourings, but the results don’t come close to the real thing. And of course the very fermentation process is key to complexity – there’s a reason we aren’t collecting single-site examples of even the finest raw grape juice. But alcohol’s a hot topic – and not just because of any health considerations. Trends and shifts in climate have seen the average ABV (alcohol by volume) inch upwards. Indeed, a report last year from Liv-ex suggested the average alcohol level has leapt almost an entire 1% for both California and Bordeaux since the 1990s. While once 14 or 14.5% might have been the purview only of the New World, it’s rapidly become the norm in Bordeaux. Rising temperatures are one element, as indeed is technology and know-how – harvesting cleaner, riper fruit and more efficient winemaking. Then, of course, there’s the fashion factor – the pendulum swing, arguably driven by Robert Parker, for bold, ripe, sweet and inevitably high-alcohol wines. “He loved that weight, that impression of sweetness,” Paul Hobbs tells me. “We jumped on the wagon – but we didn’t know what we were jumping on.” A cult name, Hobbs crafts some of Napa’s highest-scoring and most expensive Cabernets; indeed, Parker named him his Wine Personality of the Year twice. Born in New York State, the Davis-trained winemaker founded his namesake estate in 1991. He’d started his career at Robert Mondavi (arriving in 1977), working at Opus One and Simi before setting up on his own, with a flurry of personal projects and list of consultancies that has grown ever since. He openly admits that he got caught up in “Parkerisation”, crafting big, bold wines – no great surprise given the scores, and sales, that followed for those who did. But he’s been pulling back in recent years, and has never quite fit the cookie-cutout for the cult Cabernet crew. Ever since he first started making his own wines in the 1990s, he’s championed native yeasts (relatively radical at the time), and no fining or filtering. While he embraces oak, he’s always been aware that it’s the quality of fruit in the vineyard, preserved by operating a flawlessly clean winery, that is key to producing fine wine. Make no mistake that Hobbs makes rich, plush wines – and the alcohol levels certainly don’t sit at 12.5% – but for him there is much more to alcohol than one number. “I didn’t give much thought to it in the beginning,” Hobbs says. “And there wasn’t really much reason to.” When he was at Mondavi, the wines tended to sit at 13.5% – but then they started to go up. “There was a time when 16% was normal,” he confesses with some amazement. “Some of these wines were difficult. They didn’t age. They would get tired,” Hobbs says. “But all that took us time to learn – no one had ever been in that domain before.” He notes that there was “a backlash” in the British press against wines that didn’t please the palates of “the Hugh Johnsons, the Jancis Robinsons and Anthony Roses”; a response he clearly feels was a little unjust. “It’s far more complex than a simple number,” he says. “15 isn’t always 15.” And it’s true – alcohol doesn’t feel the same. How many times have you looked at the label of a wine and been surprised – either for better or worse? Alcohol is one element working in tandem with a wine’s body, concentration and flavour complexity – and there’s no easy figure to tell you how it integrates with these other components. But there’s another key reason why the same alcohol level can seem so different: the nature of the alcohol. The main alcohol in wine is ethanol (a molecule with two carbons), however fermentation produces other types of alcohols – specifically superior or higher alcohols. Often known as fusel oils – from a German term “Fusel” which is colloquial for low-quality booze – these alcohols have three to six carbons in their molecular form and are significantly more viscous (hence “oils”).  While ethanol is pure and relatively neutral, these heavier superior alcohols can – in low volumes – bring flavour, texture and interest. “It’s what makes something more than vodka,” Hobbs explains. Hexanols can add herbaceous aromas; 2-phenylethanol gives a rose-like scent. But they’re also associated with headaches and hangovers. In the world of spirits, these fusel oils are what runs out of the still last – forming the “tails” of distillation, which are used to varying degrees depending on the type of spirit being produced. “Alcohol is alcohol? Well, yes and no,” says Hobbs. It's high numbers of these superior alcohols, he believes, that can make one 15% wine feel clumsy and lumbering, while another – with lower fusel oil levels – can carry the same ABV with ease. The production of these superior alcohols depends on many things – yeast strain, temperature, oxygen availability and acidity. In general, red grapes produce more of the compounds (which is partly why spirits tend to use white grapes as their base). But Hobbs thinks it ultimately comes back to the vineyard: he’s started noticing that if berries are heat-damaged, they produce more superior alcohols. “Our goal is to keep these superior alcohols as low as possible – and that’s just about harvesting not sun-damaged fruit,” Hobbs explains. Under the warmth of the Californian sun, it’s common to get sun damage early in the season, but shrivelled berries tend to fall off nascent clusters of their own accord; more concerning is fruit that can be damaged internally and then won’t go through véraison, which needs to be sorted out. Late in the season, Hobbs and his team look to walk through the vines and cut off any “shoulders” (the side cluster at the very top of a bunch of grapes) that have been exposed. With global warming, this is an increasing threat – and an element of climate change that is only now being considered. If grapes are sunburnt or shrivelled, they tend to struggle with fermentation, and the stressed yeasts produce more of the superior alcohols. “The wine is going to be fat and heavy on the palate,” says Hobbs. “You can lower the alcohol by adding water – but it doesn’t change its personality.” If the fruit is in good shape – he says – you simply don’t have that issue, even at 15.5%. And those wines, provided they’ve got the requisite balance, age amazingly. Rajat Parr (star sommelier turned winemaker) and Jasmine Hirsch (of Hirsch Vineyards) founded In Pursuit of Balance (IPOB) in 2011 to champion lighter wines that they felt “weren’t chasing after ratings from wine critics”. These “new California” wines (Jon Bonné published his book The New California Wine in 2013) tended to have lower alcohols and less oak – following the swing of the pendulum back the other way; an anti-Parker effort in many ways. I attended the last London IPOB tasting in 2016, catching the crest of the wave as the movement called it quits – feeling they’d achieved their aim of building the reputation of an alternative California. Paul Hobbs arguably sits at the opposite end of the California wine spectrum (“Should all wines be 13.5%?” he says to me, “Why is that the magic number?”) – but philosophically, they’re surprisingly aligned. It’s not about the number, it’s about the balance – and Hobbs, like any posterchild of the new California movement, will tell you that the secret lies in the vineyard. The challenge is to farm and pick the perfect fruit – to find the sweet spot between flavour, sugar and phenolic ripeness. As Hobbs says to me, “That’s the dance between man and nature.” Forget the maths; this is farming. A note on the numbers Strictly speaking, the alcohol level on any label isn’t exactly what’s in the bottle. For wines sold in the EU and UK (both those made here and imported), producers are given 0.5% leeway – meaning that what’s on the bottle is generally reflective of its contents. In the US and Australia, however, wines sold domestically can differ by as much as 1.5% from the label – meaning a wine labelled as 14% could be anything from 12.5 to 15.5%. In an era where minimal intervention is so applauded, discussing the art, skill and work of a winemaker can be unfashionable. Producers can seem keen to gloss over or shy away from discussing the tricks of their trade. And tricks there undoubtedly are – as vintages like 2021 prove.  Jean-Antoine Chaptal was a man of many talents. Working in the late 18th and early 19th centuries, he was a scientist and statesman whose interests varied from sugar beets to gunpowder and merino sheep. For wine-lovers, he has been immortalised thanks to his 1801 paper, L’art de faire, de gouverner et de perfectionner les vins – in which he introduced what we now call “chaptalisation”. It was nothing short of revolutionary.   During fermentation, yeast converts sugar into alcohol and carbon dioxide. Chaptal realised that if you added additional sugar to raw grape juice, you could increase the final alcohol content of the wine. The sugar would, along with the natural sugars from the grapes, be fermented, producing a dry, but stronger wine, and – with alcohol a natural preservative – one that would keep better. Suddenly producers could give wines from cooler years a boost (with the alcohol adding much more than just ethanol). Some winemakers, of course, abused the technique – at one point in the early 20th century, the Languedoc reportedly produced twice as much wine as was feasible for the volume of grapes harvested.  Today the practice is strictly controlled by regulatory bodies, only permitted in cooler regions where it is deemed a useful tool, limited according to region and vintage conditions to protect quality. In marginal climates where ripeness isn’t guaranteed, chaptalisation has been the norm. Although you won’t find them in marketing pamphlets or Instagram feeds, bags of Tate & Lyle are widespread in the cellars of Champagne, Burgundy and England, in particular. It’s one reason why climate change has, for many such regions, been a blessing of sorts – the warmer conditions allowing them to more reliably bring in a crop of sufficiently ripe fruit.    Throughout the 19th century in Bordeaux, wines were often blended with those from warmer climes – the finest had a dose of Hermitage (something which Ch. Palmer pays tribute to today with its Historical XIXth Century Wine), while lesser wines had a dollop of something Spanish. Chaptalisation took over in the 20th century, and was widespread – considered part and parcel of making wine in the region.   Global warming and the technology that has revolutionised viticulture and winemaking in the region has changed that, but 2021, with its frost, mildew and generally cool conditions, saw many of northern Europe’s winemakers forced to chaptalise once more – or at least consider it.  Setting off to taste Bordeaux 2021 en primeur, I was braced for the polished spiel of the world’s grandest estates. But perhaps signalling a broader move towards transparency in the industry, what I found was a refreshing frankness. Not a single producer looked to mask the incredible challenges of the year – and the often unspoken reality of making wine in such conditions.  We asked about the potentially contentious topic at every property we visited, receiving only a small handful of slightly wary responses on the topic (“We did what we had to do,” one winemaker said, with a smile). The vast majority of producers felt it was a necessity in the year, although not everyone agreed.  At Ch. Cheval Blanc, Pierre-Olivier Clouet firmly stated, “We never touch the natural balance of the wine.” That said, they did chaptalise three plots in the end, but none of them made it into the Grand Vin. Delphine Kolasa of Margaux’s Marquis d’Alesme believes that you can almost always feel a warmness from the additional, unnatural alcohol – although she noted a few properties who had managed it so well you could barely tell.  At Les Carmes Haut-Brion, Guillaume Pouthier highlighted the balance needed with the year’s acidity levels. The relative lack of sunshine resulted in grapes high in malic acid, meaning that the malolactic fermentation (where hard, green-apple malic acid is converted into softer lactic acid) had a greater impact in the wines, reducing the overall acidity. With this in mind, he felt that chaptalisation could lead to wines feeling “flat” – but it wasn’t a necessity for him, given he managed to reach 13.5% natural alcohol thanks to the property’s warmer, suburban microclimate. These producers weren’t alone – Beychevelle, Léoville-Poyferré and Lafite-Rothschild all opted to work with what nature gave them.  But there were plenty of outstanding estates which felt it was an essential element to success in the year. At Le Pin, Jacques Thienpont remarked how they had to employ “forgotten methods”, noting that it was more than 20 years since he’d had cause to chaptalise in Pomerol. He used it on a couple of vats. Joséphine Duffau-Lagarrosse – the young vigneronne who has taken over her family’s estate – joked about having to learn how to do it, so alien is the process to a millennial winemaker. (“I called Burgundy,” she said, laughing mischievously.)  Similarly, Christian Moueix – another of the Right Bank’s old guard – noted how he used it almost every year in the 1970s, but hadn’t needed to for a long time. For him the key was not to overdo it, enough to add a maximum 1% alcohol. There was a clear consensus on this among proponents – adding half or one degree (of alcohol) was beneficial, but if you pushed things too far, you’d lose balance in the wines. That touch of additional alcohol added body, carried flavour and allowed for more extraction.  At Ch. Canon and Ch. Berliquet, they noted that they always pick on phenolic rather than sugar ripeness, but one of the quirks of 2021 was that the skins ripened before the sugar had accumulated to the expected level. They therefore picked and chaptalised to bring the wine up to 13.5%.  Omri Ram – who produced a particularly exquisite flight of 2021s at Ch. Lafleur – emphasised that he wasn’t anti-chaptalisation, but was anti it being popularised. He used it on a handful of parcels (the most humid plots) where he felt they would benefit from just “a little bit more” – with all the wines ending up between 13.4 and 13.6%. Ch. Margaux was notable for highlighting that, at least for them, chaptalisation wasn’t abnormal. They also used it on a couple of plots in 2017, 2019 and 2020.   There’s no doubt that chaptalisation can be done badly. But tasting through the 2021 vintage in Bordeaux, it’s also clear that it can be done well – used seamlessly to produce wines that are better for that spoonful of sugar. If you don’t trust us, check the critical acclaim for some of the wines mentioned above.  Intervention is key to wine – a vigneron’s craft goes beyond the field. The best wines come from carefully farmed vineyards, sites nurtured to produce expressive fruit, but it takes a talented winemaker to translate that into something you can drink. Chaptalisation – the addition of sugar to enrich wines – isn’t fashionable but it’s a practice that has long been common (and often essential). The 2021 vintage saw many Bordeaux winemakers turn to the technique; here we dig into exactly what it is – and why it shouldn’t be dismissed

A spoonful of sugar

The 2021 vintage in Bordeaux is not another 2018, 2019 or 2020. Indeed, this is a year that is seemingly without precedent. It was a year first and foremost of the wine-grower. Forget the idea that the best wines are made with minimal intervention, naturally conjured from fine terroir and effortlessly evolving in the cellar: that’s an illusion at the best of times. To succeed in 2021, producers had to put in serious graft. They needed to be out amongst the vines day in, day out. And then they needed to follow that through in the winery. Several had already written off the year after hearing about the frost and mildew that plagued the growing season (about which you can read much more in our detailed report). In our view, that’s a mistake. It’s not the vintage of the century, and anyone would be foolish to pretend it is – but there are some brilliant wines, especially for those who are partial to more elegant styles, lower alcohol levels and freshness. It’s important to caveat that when we discuss a vintage en primeur, we are talking about the very crème de la crème of Bordeaux – the finest estates who have not only the region’s best-sited vineyards, but the necessary resources – the manpower, money and equipment – to be able to succeed. Our 10 days in the region revealed the full complexities of the year, one where it is nigh-on impossible to generalise. As Omri Ram at Ch. Lafleur told us, “There are hundreds and thousands of 2021s.” The key was being able to analyse what was happening in the vineyards – and then be able to act on it. Quickly. For Ram, with 24 people working 21 hectares, that was fortunately possible. At Ch. Lafite Rothschild, Technical Director Eric Kohler told us that the cost of production in 2021 was an almost incredible 45% higher than normal. Christian Moueix estimates his team spent 30% more hours in the vineyard than normal. At Ch. Ducru-Beaucaillou, they hired an additional 35 people to manage mildew amongst the vines in June and July (surplus to the normal 40), while at both Ch. Rauzan-Ségla and Les Carmes Haut-Brion they had enormous teams for the harvest – 150 each, harvesting and sorting at Rauzan-Ségla, and doing three or four passes through each plot at Carmes. At Smith Haut-Lafitte, they bought five additional tractors to ensure they could spray the entire property in one day. “All the challenges we could dream of happened,” said Jean-Basile Roland of Ch. Rauzan-Ségla. Because of these challenges, it’s a vintage that producers are justifiably proud of – for it was a hard-won battle, and Covid-19 was still a consideration. Yields across the region varied significantly. In total, the region produced 14% less than in 2020, but some estates reported a full crop. At others, they had the lowest yields since 1991 – largely due to mildew, although frost was a factor as well. Inevitably, estates working organically and biodynamically had more of a battle when it came to mildew so were more significantly impacted. Both elements had less of an impact than might be expected, however, as producers have learnt – and invested – after the severe frosts of 2017 and mildew of 2018. As already highlighted, this was a year of the grower; where the human hand was everything. There were key decisions to be made at every stage of the season and these influenced the style of wine produced. Again, from what we tasted there wasn’t a right or wrong decision to be made – but it’s important to emphasise the various elements that have defined the wines this year. First up was picking. In general, harvest dates were much later than we’ve seen in recent years – producers having to wait for ripeness to arrive in the year’s cooler conditions. Merlot started coming in at the end of September, and most finished picking their Cabernet by 18th October. The key decision was around the first weekend in October, when heavy rain was forecast, yet most Cabernet wasn’t yet ripe. Some rushed to pick their fruit, while others took the risk and waited. Those who held their nerve were rewarded; the storms were replaced by sunny days for key ripening. While recent years have seen producers waiting for phenolic ripeness, with sugar levels soaring in warm conditions, 2021 saw something different. At some estates, phenolic maturity arrived first, with the sugar never quite following; at others the phenolic, flavour and sugar ripeness all seemed to arrive at once. For the former, chaptalisation was necessary. This practice – the addition of sugar prior to fermentation to increase alcohol levels – was once the norm in marginal climates like Bordeaux, Burgundy, Champagne, the Loire and many more. Opinions on the topic are rife, with some winemakers extremely anti; from what we tasted, where well-judged and expertly managed, you can’t tell. There were a handful of wines with warming alcohol that doesn’t feel fully integrated, but where done well, chaptalisation has rounded the wine out – fleshing out the body with half a degree of alcohol or so. It’s also important to emphasise that chaptalisation is something we simply haven’t spoken about previously – at Ch. Margaux, Aurélien Valence highlighted that they even chaptalised a few parcels in 2019 and 2020, while some estates haven’t done so for decades. Some châteaux opted for reverse osmosis as an alternative way to concentrate the wines, generally on lower-tier wines. Given the year’s challenging conditions, producers didn’t face a crop of flawlessly clean fruit. It was a cool and damp year and sorting was essential. Optical sorters are now the norm at many addresses, but this year saw the addition of density baths at several estates (Chx Léoville and Langoa Barton, Angélus and Smith Haut-Lafitte, to name a few, following in the footsteps of the likes of Ausone). Indeed, just at Smith Haut-Lafitte, there were six stages of sorting across the vineyard and winery to ensure that they kept only the finest fruit. One point of discussion at almost every estate was how producers managed extraction. With the year’s wet conditions, berries were generally plump and dilution was a risk. The cooler weather also meant that tannins weren’t necessarily as ripe, although in terms of “IPT” (the Indice de Polyphénols Totaux – the level of tannins, a number that has started appearing on technical sheets and critic reports increasingly in recent vintages) 2021 had the same numbers as 2018, ’19 or ’20.  The difference, however, was that there isn’t the same stuffing to balance it – so it was essential that tannins were handled gently. Cold soaks were used at several addresses to extract colour and flavour, but not tannin; many opted for gentler and shorter maceration periods. Saignée – the act of bleeding off juice to concentrate what remains – was commonplace, and higher portions of press wine feature in several blends. Several producers noted that in particular the seeds or pips weren’t ripe this year, so it was important to avoid extracting tannins from them; it’s one reason for the significant portion (45%) of whole-bunch fermentation for the Grand Vin at Les Carmes Haut-Brion. The blends this year are in some instances atypical. On the Left Bank, the Merlot struggled with coulure (uneven fruit-set), meaning some wines have record-high proportions of Cabernet Sauvignon in the blend (a record 98% at Ducru-Beaucaillou, 96% at Lafite, 90% at Calon-Ségur, for example). Cabernet Franc seemed to thrive on both sides of the Gironde, and represents higher-than-normal percentages on the Right Bank (30% at L’Evangile, 60% at Angélus). You may also find a little more Petit Verdot in blends than normal – used to add both colour and spicy richness to the wines (for example, representing 6% at Pontet-Canet). Given the generally lighter style of the wines, élevage will be key. While of course this is not set yet, many producers have opted for lower levels of new oak and plan to leave the wines in barrel for slightly less time. As Noëmie Durantou Reilhac of Ch. l’Eglise-Clinet highlighted, this is to preserve the wines’ delicate tannins and aromas. At Ch. Rauzan-Ségla, Jean-Basile Roland noted that it was particularly important this year to use hot water and steam to extract the harshest tannins from barrels before they were filled. And so what of the style of the actual wines? Well, as you can tell, it is not easy to generalise. This is not a Left or Right Bank year, in our view, although we found a little more consistency amongst estates on the Right (and especially warmer Pomerol). Despite the fact that Merlot struggled a little on the Left, it doesn’t seem to have been such an issue on the Right Bank – it’s neither a Cabernet or Merlot vintage. Several producers were quick to declare it a “terroir” vintage – and certainly it seems that limestone and clay soils were an advantage – but terroir was not the only element at play. It really is a year that needs to be judged individually, per estate and wine. We noted in particular that some second wines have suffered from the selection required to achieve greatness in the Grand Vin. The best embraced the natural style of the vintage – working with the year’s elegance rather than battling it. There is an old-school charm to the finest wines, yet with a very modern fruit profile. “Modern classic” was a term that came up time and again, although we’re loathe to repeat it. At Vieux Château Certan, where Guillaume Thienpont has undoubtedly made one of the wines of the year, he described the wine as “two-thirds perfume, one-third flavour”, while Pierre-Olivier Clouet at Cheval Blanc – another overperformer this year – considers it “academic” rather than “classic”, built on dual pillars of tannin and acidity.  The best wines have fresh acidity, delicate and often floral aromatics, with crunchy fruit – often more at the red end of the spectrum. Alcohols tend to sit between 12 and 13% (a little higher on the Right Bank) and the tannins are not negligible, often providing a chalky grip, and they are surprisingly approachable now. They won’t be wines to cellar for the serious long-term, but will be one of those vintages to consistently overperform – surprising blind tasters with their charm as they evolve in bottle. Given all this, it’s no surprise that producers struggled to find a comparative vintage. Faced with such tricky conditions just a decade ago, producers wouldn’t have been able to make the wines they did today. The 1990s were consistently used as a reference point in style, but more recently 2001, 2008 or possibly 2014 offer the best comparison in terms of style – if not climatic conditions. The wines are more concentrated than 2017, and as is very clear, drastically different to 2018, ’19 or ’20. The vast majority of what we offer en primeur is red, and that is where the focus of our report lies, but this was an exceptional vintage for whites. Several estates feel they’ve made the best wines in their history – and certainly from our tastings that is true. At Ch. Margaux, Aurélien Valence said they thought 2017 was their best Pavillon Blanc, but 2021 exceeds it. The cool conditions that made the year challenging for reds was perfect for the white grapes, which benefitted from the long, slow growing season – offering aromatic ripeness, yet vibrant acidity. They really are superb. Crops in Sauternes were decimated by frost unfortunately (Ch. Suduiraut has just 500 cases of its Grand Vin to offer the world), but what little we tasted was similarly outstanding. Buy what you can of these increasingly rare and special wines, made at almost illogical expense. “Two generations ago everyone made Chablis like this. Now I am the only one left,” says Daniel-Etienne Defaix proudly. It is amazing to think that production methods could completely reverse in such a short time, no doubt fuelled by the “Chardonnay boom” of the mid-70s onwards. This insatiable global demand for crisp, clean, saline-tinged Chardonnay has shown no sign of abating ever since.  The commercial success of Chablis (one of the few white wines found in practically every supermarket, off-licence and fine wine store around the world) is staggering, particularly as the region in itself is remarkably small. While both premium growers and commercial production have, in many ways, sat comfortably alongside each other (even among the top traditional premium growers such as Raveneau, Dauvissat, Billaud-Simon and Droin, the length of élevage has reduced considerably in this time. Despite being the oldest domaine in Chablis, established in 1610, his father (like most other producers in Chablis when exports boomed) started to produce Chablis in the modern way. The time spent ageing the wine on its lees dropped down to six to nine months, in order to release the wines as soon as possible, and meet market demand. Unimpressed by his father’s results and the wines’ ageing capacity, it was Daniel-Etienne’s decision to change tact and to retrace his grandfather’s footsteps, performing a longer élevage – which for Defaix brings out the complexity and terroir characteristics Chablis is truly capable of.   So why has Etienne persisted? What is it that makes this technique so valuable to him? He admits he is fortunate to own the largest cellars in Chablis, claiming to have seven to 10 times more cellar space than anyone else in the village. ”This gives me a lot more freedom,” he explains – both in terms of ageing his wines (of which he has up to 15 vintages of each Premier and Grand Cru in the cellars at any one time), but also financial freedom. “My wines are my own bank: I don’t need to take out loans when there is a poor harvest,” he says. This no doubt puts Defaix in a minority in Chablis, where yields have been pretty catastrophic over the last decade, plagued by spring frosts. Financial autonomy has allowed him to continue making his Chablis in a traditional long-ageing method, while at the same time keeping pricing incredibly fair.  According to Defaix the key to long-ageing Chablis is protecting the glycerol content in the grapes, since it is the glycerol that takes around two years on the lees to break down and starts to act as an anti-oxidant. He does this by carrying out slow, three-hour press cycles of the grapes and keeping only the first press for bottling. He ferments at a cool 18°C, again to preserve the glycerol in the must. “Glycerol provides the balance in aged Chablis between sugar and alcohol. Glycerol gives fat and seduction to the wine,” says Defaix. “It brings a brioche taste to the wine, without being sweet.” But this takes time to produce: Defaix typically ages his Premiers Crus a staggering seven to nine years on the fine lees in tank; for his Grands Crus it can be eight to 15 years!    It might come as a surprise that – despite making this almost forgotten, ultra-traditional style of Chablis – Defaix machine-picks all his grapes. But this decision was not made easily, nor without extensive testing. He explains that they were, in fact, one of the last domaines to buy a machine harvester. Back in the ’80s his father, sceptical of others’ results, started his own research – picking half the grapes by hand and half by machine. After 10 years in bottle each year, they invited wine professionals, chefs and sommeliers to blind taste both. Every single time, the wines by machine were unanimously thought to be better. Defaix came to the conclusion that the exact timing of the harvest is more important than the hand selection. He also states that the technology makes today’s picking machines extraordinarily accurate: ripe fruit falls in the basket, rotten fruit is too light and is easily filtered out, while any green grapes stay on the vine. Turbines attached to the machine suck in the leaves and insects and are removed prior to the grapes reaching the winery. During his experiments, his machine harvested-fruit was a full 1.5% higher in alcohol than the hand-selected fruit in poor vintages.  Daniel-Etienne is the 15th generation of his family to produce wine in Chablis over the last 400 years. Now in his 35th vintage, he has never been more convinced by his traditional style, its ageability and its ability to express the varied Chablis terroir.  Read more Editorial

Daniel-Étienne Defaix: Chablis built to age

When visiting the cellars of Domaine Hubert Lamy, you are likely to come out a lot wiser than you were when you went in. Olivier Lamy has been experimenting ever since he joined his father at the domaine in 1995, and he loves to share his findings.  On our last visit we were given two white wines blind and asked to assess them. One thing seemed immediately clear: with its deeper colour and more developed savoury tones, one wine was older than the other. “No” he replied. “They are the same age.” Okay, perhaps the reason for such variation in development is due to the wines coming from two different quality sites – a Grand Cru versus a village wine for instance? “No, it is the same vineyard,” he replied. Perplexed, the only other solution I thought must be his high-density plantings. (Olivier has planted parts of his vineyard three times the density of the norm in Burgundy, with up to 30,000 vines per hectare), the result being smaller, more flavourful berries. Wrong again.   “Wrong experiment,” he smirks, leaving us completely stumped. He presents the two bottles and the answer lies with the capsules. Both wines have the same cork closure but one has the traditional metal capsule seal, the other bottle has been dipped in wax. It is the wax capsule that seems not only younger and fresher, but more texturally complex, yet both the wines are from exactly the same vineyard, with the same vine density and vintage. It is simply the closure that has preserved one wine so much better.   Olivier has been experimenting with closures for years. There have long been concerns about natural cork, with the risk of cork taint top of the list of potential problems, but it was the issue of premature oxidation, particularly with white Burgundy, that led Olivier to investigate whether maybe the problem lay with the closure.  Despite the drop in natural cork’s popularity and their replacement with alternative, “technical” corks and screwcaps, the natural cork still has plenty of advocates, and it remains the most sustainable and natural of solutions for many. A better understanding of the causes of cork taint has vastly improved the natural cork’s reliability and reputation, yet “being a natural product there remain irregularities in the cork,” says Olivier. Natural cork is irregular in structure, therefore allowing different levels of oxygen ingress, meaning that the same wine can mature differently depending on the specific cork, and resulting in bottle variation.  Olivier also believes the irregularities of cork have become worse in recent years due to climate change, with the warmer temperatures resulting in even less consistent cork.  The benefit of the wax capsule, according to Lamy, is that it acts like a “bandage”, offsetting the irregularities of the cork. His grandfather and many other winemakers often used wax capsules for wines destined for their personal cellars; it was the reliable ageing capacity of these wines that prompted his experiments. Trialling the effects of waxed and unwaxed capsules since 2009, he decided to use wax capsules on all his wines in 2016. Over this time, he has experimented with varying diameters and lengths of cork, different treatments, as well as testing plastic, agglomerate, and technical corks before concluding that longer (54mm), technical DIAMs (a natural cork-based agglomerate closure), under wax seal produce the best results and best protect against premature oxidation.  Does this mean we have a definitive answer to the question that has plagued white Burgundy for the last couple of decades regarding premature oxidation? While his experiments certainly seem to imply that the irregularity of natural corks could be one of the biggest culprits and wax capsules one of the most successful solutions, he does not believe it is only the cork which is at fault. “There are two problems,” he says. “Poor-quality corks and the fact that wines are more fragile these days.”  The increased fragility of white Burgundy, Lamy believes, is a modern phenomenon. Climate change produces riper grapes, combine this with too many new barrels, modern presses that are too protective and you have wines that are more susceptible to oxidation. All too aware of this concern, many vignerons, Lamy believes, attempt to overprotect their wines, adding too much anti-oxidative sulphur dioxide (SO2) throughout the winemaking process. Counter-intuitively, this in fact makes the wines more susceptible to oxidation. When wine is made in a more protective environment, the more volatile phenolics remain in the wine, whereas these will drop out of a wine  when it is made oxidatively at the early stages of vinification, resulting in a much more stable wine.   Despite vignerons’ better understanding of the effects protective winemaking has on long-term ageing, these techniques are still used by many because it makes the wines so much more approachable in their youth. Many white wines today are built on developing these youthful aromas at the expense of ageing potential, Lamy argues. This is, he says, is in direct contrast with the past, where wines were built on texture, remaining fairly closed in their youth, with the aromas only developing with age.  There are still many traditional vignerons in Burgundy producing textural white wines built to age – with Lamy (who does not enjoy young, aromatic Burgundy) being one of them. With the warming climate, he has, however, had to adapt his winemaking to protect these more fragile wines. These days he manages the press cycle according to the vintage and allows for more solids when required.  With all the wines now bottled under DIAM and wax capsules, all Lamy can do now is wait. But, if his experiments are anything to go by, the risks of premature oxidation are low. Of course, he’s not sitting back – the dynamic winemaker is looking to experiment even more, pushing the boundaries to produce the best, and most age-worthy, wine possible.

When a wine is on "pre-arrival", it means that we have a confirmed order on the bottles from our supplier and we are simply waiting for the winery or distributor to ship the wine to us. The delivery timeframe for pre-arrival wines varies significantly, depending on where the wine is coming from. We will notify you once they arrive at our warehouse and, at that point, you can decide to arrange shipping or list them for sale.
