Low-yielding burgundian Pinot Noir clone 115. Hand-picked, hand-sorted and de-stemmed directly into fermenters via gravity. Once inoculated, the grapes were gently pumped over once a day for a period of two weeks. Once the primary fermentation was complete, the wine was drained off its skins into two-year-old French oak barrels, where it underwent malolactic fermentation. After three months' ageing in barrels, the wine was lightly filtered and bottled in spring 2019. Pale, garnet-tinted red. Lots of vanilla-scented barrel spice on the nose. Sharpness to the cherry fruit injecting fire-engine-red cranberry angles and brightness. Transparent to its ruby-lit core with a keen, cuspate acidity. Elegant and lean and leggy. There is very exciting potential here. (TC)
