The 2021 Cabernet Sauvignon Commitment is a positively stunning, riveting wine from Henry and Vanessa Cornell. Hints of graphite, pencil shavings and lavender play off a core of blue-toned fruit. Silky and powerful, the 2021 is a gorgeous, wonderfully complete Cabernet Sauvignon. The Commitment is the same wine as the first release, but aged for an extra year in barrel. That's an approach that doesn't always work, but here resulted in a wine of exquisite finesse. I am blown away by the wine's vibrancy and elegance. Haute couture.

Full bottle 1,308 g. Deep inky purple. Rich cassis, blackberry and black-plum skin with a light undertone of spicy oak. Fine-grained grippy tannin that clings to your cheeks briefly before being washed away by equally persistent acidity. Lovely classic bouquet and palate. (SCJ)

The 2021 Cabernet Sauvignon is showing very well for a wine that was bottled just a few months ago. Sweet floral and spice notes open first, conferring notable freshness and vibrancy. Medium in body and beautifully persistent, the 2021 impresses with its finesse more than anything else. Time in the glass brings out hints of red/purplish fruit, rose petal, lavender and spice. The Cornell Cabernet Sauvignon usually needs a few years to blossom post bottling, as I once again saw with the 2018 that I opened at home recently. I expect that will be the case here as well. In a word: regal.

The 2021 Cabernet Sauvignon, tasted from a base blend of pure Cabernet Sauvignon, is hugely promising. It reminds me of the 2019, but with brighter acids and a bit more tannin. A wine of vibrancy and power, the 2021 is a jewel of a wine. Exotic dark fruit, gravel, incense and spice build into the potent finish.
