The new 2014 Volare del Camino is the first pure Malbec from 100% limestone soils, with the freshness of the place where the vines were planted at 1,400-1,500 meters altitude. It's like a mixture of lime and flowers, perfumed, reeking of Gualtallary. It has a fine texture, ultra-refined tannins and detail and filigree like no other. They picked the grapes from parts of the vineyard that allowed earlier harvesting for the ripeness level they want in their wines (this is 14.5% alcohol with 6.5 grams of acidity in tartaric). The hand-harvested grapes were destemmed into 300-kilo bins where they fermented with indigenous yeasts with only the softest pigeage for 30 days. It matured in well-seasoned, neutral oak barrels for 16 months. The nose kept changing, coming and going, all of a sudden closing down. This is from limestone soils, which provide a different texture, it's not stones covered in chalk. A mix of flowers with chalk and spices. It has incredible tension, ultra-fine chalky tannins and an unusual combination of perfume and austerity that can seem contradictory. 900 bottles were filled unfined and unfiltered in January 2016.
