At ten years of age the 2007 Cabernet Sauvignon Estate is just beginning to enter its first plateau of maturity. Super-ripe black cherry, plum, espresso, spice and new leather take on elements of exoticism. Racy and forward, the 2007 has enough depth to drink well for another 10-15 years, but I don't see it being one of the more long-lived wines to emerge from this Spring Mountain estate. This is a decidedly rich, unctuous Cabernet by Togni standards. Lisa Togni adds that harvest started on October 3 and that the crop was bountiful. (AG)

Displaying a more saturated ruby/purple hue, the 2007 Cabernet Sauvignon Estate offers a sweet perfume of blueberries, black raspberries, black currants, and spring flowers. More open aromatically than on the palate, it reveals medium to full body, and an elegant, finesse-styled personality. Togni’s wines always have a Bordeaux-like structure. It is a gracious, savory effort that should age for 20-25 years. Perhaps now that Togni’s daughter, Lisa, is working at the winery, there is an ongoing effort to make the wines more friendly at an earlier age. Certinaly the 2007 seems to suggest that. My aging curves are not exaggerated, but many of Togni’s early wines, such as the still monumental 1969 Chapellet, are still remarkable wines at age 40, having just gone through their adolescence! Deep ruby. Inky blackberry and dark chocolate on the nose. Lush, sweet and primary, with ripe briary berry and dark chocolate flavors complicated by a smoky nuance; became even more plush with aeration, showing an enticing boysenberry flavor. Finishes very long and sweet. Philip Togni had a big crop in 2007 and thinned the fruit extensively, ultimately harvesting in early October, just before a day of heavy rain on Spring Mountain. The 2007 blend includes 20% press wine.
