Racked three weeks before my visit, the 2021 Chablis Vaillon 1er Cru is 40% fermented in barrel due to the lower volume, with everything now transferred into tank. It has a slightly leesy bouquet with subtle pressed flower scents. The palate is well-balanced with a fine bead of acidity, lovely white peach and blood orange notes and a lilting, harmonious finish. Give it a year in bottle.
