The 2007 Chablis Grand Cru les Clos des Hospices has a simple, slightly waxy, mushroom-scented bouquet that feels a bit funky at the moment. The palate is fresh on the entry, not terribly complex but with a fine thread of acidity and a tangy, marmalade-tinged finish. Fine. Tasted June 2017.

(this was entirely in barrel, but less than 2% new oak, until the February '08 racking and then went into tank) Bright yellow. Tight nose suggests fresh stone fruits, acacia flower and spice. Then rich, creamy and round, showing more of its texture and personality today than the more lemony and brisk regular Clos bottling. This is really remarkably tasty already but has the stuffing and balancing acidity for a leisurely evolution in bottle.
Bright green-tinged yellow. Highly complex nose melds peach, acacia flower, vanilla and white pepper. Creamy and ripe but firm, with vibrant yellow fruit flavors complicated by wet stone and sexy oak hints. A real mouthful of rocks! Offers superb volume, opulence and silky texture for the vintage. The rising finish stains the palate with wet stone minerality. A knockout in the making: this really transcends the vintage. Incidentally, the acidity here is 4.7 grams per liter, compared to 4.4 for the regular Clos cuvee
