The star of Francois Cotat’s 2004 collection already from its days in barrel, his 2004 Sancerre Les Culs de Beaujeu displays an aroma combining lime and grapefruit with chicken stock and an herbal infusion. Firm but juicy on the palate, it is ultra-mineral yet also evinces strong, sweet inner-mouth floral perfume, spicy pink grapefruit, and hints of honey that persist in a long succulent, opulent-yet-dry finish.
