‘A Cabernet for Pinot drinkers.’ Bought in from the vineyard next to Punt Road. Picked at flavour ripeness when the methoxy greenness has disappeared. 100% whole bunch, but they crush enough berries, about 30%, until he’s happy with the tannins. ‘How come the whole world destems Cabernet Sauvignon?’, asks Timo rhetorically. Round Cabernet Sauvignon! Pretty commercial and approachable. Simple wine bar wine! The 2006 was undrinkable at first but apparently is now very good. (JR)
