Saint-Emilion has been hitting the headlines. And not in the way it would like to. In July, just after the region’s châteaux submitted applications for the 2022 classification, two of the region’s four Premier Cru Classé A estates – Chx Cheval Blanc and Ausone – announced that they would be withdrawing from the classification system. This week sees a dispute over the 2012 classification enter the courts – with accusations that the results were fixed. The Médoc’s leading names were ranked in 1855 – with but one change (Ch. Mouton Rothschild's promotion) in 1973. The classification was uncomplicated, with no fussing over terroir, tastings or winemaking talent; it was based purely on price. It’s hard to believe that it remains relevant today – but, while of course there are properties that stand out, it’s more or less accepted, and reflective. Across the river in Saint-Emilion, they wanted something different. Something fairer. A system that flexed with an estate’s waxing and waning. The ambition was – and is – laudable. The reality, well… The classification is overseen by the Institut National des Appellations d’Origine (INAO) – the body responsible for France’s appellation system. The concept was mooted in the 1950s, with the first list published in 1955. The idea was that it would be re-drawn every 10 years – both to be more democratic and provide an incentive for long-term quality. Unlike the Left Bank’s system, it would assess terroir and include a tasting of the wines. The aim was, and is – as a spokesperson for the INAO told me, to help consumers distinguish between the region’s many properties and help “maintain a level of excellence”. The classification is based on a scoring system out of 20, with the breakdown of scores different to qualify for Grand Cru Classé (requiring a minimum 14 points) versus Premier Grand Cru Classé (requiring a minimum 16). In 2012, the possible points for Premier Grand Cru Classé were broken down thus: 30% based on the quality of the wine – with a tasting of 15 vintages; 30% on the estate’s terroir; 35% on the property’s renown (both national and international), promotion and distribution; and the remaining 5% on viticulture, vinification and traceability. Even the first, 1955 list was disputed, changed just three years later, then again two months later, before settling on 63 Grands Crus Classés and 12 of the elite Premiers Grands Crus Classés. The very best of this latter group were named “Premier Grand Cru Classé A” (the rest Premier Grand Cru Classé B) – with just two making the cut, Chx Ausone and Cheval Blanc. Since 1958 the region’s wines have been re-classified regularly – if not quite on the 10-year cycle forecast, in 1969, 1986, 1996, 2006 and then 2012. But there has always been an undercurrent of discontent. In 2006, five properties filed lawsuits and the ruling was declared invalid, with the 1996 classification reinstated. For the 2012 classification, the INAO seemed determined to clean things up. The tastings and site inspections were, for the first time, outsourced by the INAO, with wine professionals from other regions (Burgundy, the Rhône, Champagne, the Loire and Provence) roped in – including Marcel Guigal and Robert Drouhin. A company called Qualisud was to handle the tastings, while Bureau Veritas would take on visiting the estates. These independent authorities would, they thought, make it indisputable. The result was two new Premiers Grands Crus Classés A estates – with Chx Angélus and Pavie; while Larcis Ducasse, La Mondotte, Pavie Macquin, Troplong Mondot and Valandraud all promoted to Premier Grand Cru Classé B, and significant changes to the Grands Crus Classés (with a new total of 64 estates). But of course that wasn’t the end of it. Enter Chx Corbin-Michotte, Croque-Michotte and La Tour du Pin Figeac. The latter two had applied for and hoped to be promoted to Grand Cru Classé, while Corbin-Michotte was demoted in the 2012 rankings. They argue that the decision against them was “incomprehensible”, challenging the criteria for classification and insisting that two individuals – Hubert de Boüard (of Ch. Angélus) and Philippe Castéja (of Ch. TrotteVieille) – had “undue influence” with their roles within the INAO. It’s alleged that de Boüard was “present at all stages of the process elaborating the 2012 classification” (with it implied he influenced the ranking not only of Angélus but seven properties for which he consulted), while Castéja “pulled strings” to guarantee TrotteVieille’s Premier Grand Cru Classé status. The case went to administrative court, however the plaintiffs lost in 2015. They appealed, but lost again in 2019. And now they’re taking it to the criminal courts, with jail time and a fine of up to €500,000 on the cards for the accused. When I asked Frédéric Castéja – Philippe’s son and General Director of Borie Manoux – about the accusations, he told me: “I can only tell you that the Attorney General has dropped all accusations against [my father] and stated that he was not concerned at all with this so-called ‘influence’.” “When it comes to a public ranking, the level of controversy is as high as the stakes,” the INAO told me. It’s unsurprising, perhaps, given the impact the classification can have on an estate’s bottom line. After their promotion in 2012, Chx Pavie and Angélus saw instant price hikes: 2012 Angélus was released at 30% more than the 2011 en primeur, while Pavie went up 58%. That’s big bucks. And beyond the actual wine, it’s the land prices that really rocket. It wasn’t just these three (relatively minor) properties that seemed dissatisfied. Rumour has it that each year, the Médoc’s First Growths, Cheval Blanc, Ausone and Pétrus (“the group of nine”) all meet to taste the latest vintage. After Pavie and Angélus became newly minted First Growths, the group reportedly preferred to restrict the group to the original set. And in 2012 Ch. Ausone quietly removed the classification from its labels – a hint at what was to come. Eric Morain – one of the lawyers representing the three disgruntled estates – has commented that the classification has become “a system that sells the brand and no longer the grape”. La Revue du Vin de France’s 2021 Man of the Year, the attorney is a specialist in the world of wine and has earned a reputation for standing up for the little guys. He was instrumental in establishing the Syndicat de Défense des Vins Naturels (which introduced the Vin Méthode Nature trademark last year – a formal definition for natural wine in France), and has defended several wronged natural wine producers, such as Olivier Cousin and Alexandre Bain. Morain’s latest crusade, however, is against two goliaths – with connections and deep pockets. “The classification was thought out and developed and judged by people who had a direct interest. The rules were not the same for everyone,” Morain said on email to me. De Boüard and Castéja should have recused themselves, he argues. For Chx Corbin-Michotte, Croque-Michotte and La Tour du Pin Figeac (“They aren’t notable, just winegrowers who do their job well,” Morain says), this isn’t about money. They just want someone to admit they were wronged, unfairly excluded from the ranking. “Will they be convicted?” Bordeaux expert Jane Anson pondered, “I would imagine not, but I guess we will all have to wait and see...” For her, the drama is an unnecessary distraction “from the excellence of the wines and the entire classification”. In the meantime, the process for the 2022 classification has been rumbling on, with applications submitted this summer. Some changes have been made, again trying to make the classification – once and for all – watertight. Independent third party Bureau Veritas is now in charge of both tastings and site inspections, and the weighting of the tasting element has been increased for the Premiers Grands Crus Classés (bringing it in line with the weighting for the Grands Crus Classés) – worth 50% of the score (previously 30%) – while the portion for a property’s terroir has been reduced to just 10% (previously 30%). The puzzle is why the criteria remain different for a Premier Grand Cru Classé versus a Grand Cru Classé – something for which I haven’t been able to find an answer. Given estates need to score 17 for the heralded Premier Grand Cru Classé A, 16 for Premier Grand Cru Classé B and 14 for Grand Cru Classé, why make things even more complicated and declare that, for example in 2022, the quality of terroir has more significance for a Grand Cru Classé than a Premier Grand Cru Classé estate (20% versus 10% for the latter)? To make it into the upper echelons of the Premiers Grands Crus Classés, reputation is considered key – and this is a sticking point for many. While reputation, promotion and distribution represents 20% for the Grands Crus Classés, it stands for 35% of a property’s score for Premier Grand Cru Classé status. Including elements such as wine tourism, social media, PR and the accessibility of an estate, it has prompted remarks that the size of a winery’s car park has more relevance than the quality of its soils. The INAO emphasises that the criteria are very similar to those of the original classification in the 1950s. Reputation has always been included, they argue – they are simply adapting this to the modern day. Either way, it’s a minor element, they assure me – with, for example, social media representing just 0.3 points, or 1.5% of the final score, while wine tourism makes up a mere 1%. This hasn’t soothed the worries of the region’s two original Premiers Grands Crus Classés A properties, Ausone and Cheval Blanc. News broke soon after applications for the classification closed on June 30th that the prestigious estates had not submitted anything. When I spoke to both estates ahead of en primeur (April this year), the responses were interesting. Pierre-Olivier Clouet, Technical Director at Ch. Cheval Blanc, noted it was “a touchy question” before he continued. “We believe it’s quite difficult in 2021 to classify the wine like in 1855. This is not the same period this is not the same price per hectare, it is not the same price per bottle… Producing an outstanding wine is difficult on paper,” he said. “We don’t produce wine for the critics, for the classification – we make wine for the wine lover. Premier Grand Cru Classé A, Premier Grand Cru Classé B, Grand Cru Classé… we are Cheval Blanc, that’s it.” When I enquired whether he felt a wine’s distribution should have as much weighting as its terroir, he shrugged and smiled: “The answer is in the question.” Pauline Vauthier of Ch. Ausone was less willing to broach the topic, not wanting to be embroiled in the debate. “What counts is the quality of the product,” she said – making very clear that that is where the estate’s focus lies. “There are many classifications and they’re difficult for the public to understand. Ausone prefers to communicate about the quality of its wine.” She added: “[The 2012 classification] created much controversy, and that will certainly be the case with 2022.” When the news broke in July that both estates were withdrawing (along with sibling estates, La Clotte and Quinault l’Enclos), Pierre Lurton (Director of Ch. Cheval Blanc) and Clouet told Terre de Vins that there wasn’t enough emphasis on “the terroir, the wine, the history”. Edouard Vauthier (Ch. Ausone) explained, “Since 2012, some criteria added are not linked into the wine itself anymore. Some people apply for the classification for economic reasons more than quality and the respect of the terroir.” He highlighted that many of their customers hadn’t even noticed that “Premier Grand Cru Classé A” was no longer on the label. Indeed, why would they? Interestingly, these estates agree with Eric Morain on this. For Morain, the tasting component should represent much more – and as long as it counts for so little, “the classification will mean nothing”. The two behemoths are their own brands – brands that are much stronger than that of Saint-Emilion Premier Grand Cru Classé A. The loser, sadly, is set to be the classification itself, and its top-tier properties – which will no longer benefit from Cheval Blanc and Ausone’s halo effect. Of course, the INAO was keen to emphasise that – whether classified or not – the two estates would always be closely associated with the region, and that there were plenty of other estates that eagerly submitted applications. “Ausone and Cheval Blanc have always been driving forces behind the appellation and I hope will remain so,” Frédéric Castéja told me. “The risk is that at the next occasion other top estates (meaning other First Growths) do the same, then if too many leading estates leave, the classification is meaningless.” Morain – unsurprisingly given his campaign against the classification – is damning about its fate. Ausone and Cheval Blanc’s departure is, for him, “a symptom of a system on its last legs”. So is the 2022 ranking set to be the Saint-Emilion classification’s swansong? Perhaps – the more important question is maybe if it matters. “Saint-Emilion has so many châteaux (by far the most of any of the prestigious appellations) that there is a definite benefit to have some way of distinguishing the best wines,” Jane Anson said. “I fully agree with the principles, in fact think the idea of a renewable classification is very much consumer-driven and provides an incentive to estates to keep investing etc, but I think it has become unworkable.” And that is the problem – the theory is excellent, but how can it be put into practice? While the classification sounds helpful in principle, for most people, I suspect it isn’t. There’s too much confusion with Grand Cru, Grand Cru Classé and Premier Grand Cru Classé A or B. Unlike the Médoc’s straightforward numbering of First to Fifth Growth, it is not – to the uninitiated – immediately clear which is meant to be better than the other. Price and branding of an individual estate will be the more important differentiator. Talking to other producers in the region, few have answers – and few wish to champion the system’s survival. I asked Noëmie Durantou Reilhac – of Denis Durantou estates – whether she’d ever wish to see something similar in Pomerol. The answer was a firm no (“definitely”). “What really saddens me is seeing some plots in Saint-Emilion Grand Cru that are truly devastated,” she tells me. When I ask Nicolas Glumineau at Pichon Comtesse in Pauillac – a producer with a little distance – about his thoughts on it, he’s quick to quip: “That’s why we have an 1855 [classification] that we never move.” More seriously, he thinks the decade cycle is problematic. “I have this feeling that one classification every 10 years is probably too fast, too frequent. Probably 25 years – one generation could be enough.” Of course applying for the classification is voluntary – and not everyone does. Ch. Tertre Rôteboeuf, notably, has never played the game – despite the high quality of its wines. (The property is also renowned for handling its own distribution, outside the négociant system.) Ch. Haut-Brion owner Prince Robert of Luxembourg recently highlighted a benefit to being outside the classification – announcing his plans to expand Quintus with vineyards from the recently bought Ch. Grand Pontet. And this really gets to the point of what could make the Saint-Emilion classification work. As Anson said to me, “Saint-Emilion is the only classification in Bordeaux that includes the notion of terroir (and in fact taste) and that is also linked to a specific piece of land.” A classified property can’t automatically include new vineyards – unlike estates on the Left Bank. The classification is admirable in many ways – but how can you really quantify excellence? Is it ever really possible to pin down the true quality of a wine, or estate, with such exactitude? Is the picture not more nebulous than points can ever paint? “All classifications are correct as long as all players clearly know the rules,” Frédéric Castéja noted. “One must remember that classifications are always the picture of the past, but of course confirm the potential of the estate.” For Saint-Emilion, even the past feels in flux – discussed and debated. What the future holds is hard to say – but, for now, we’ll wait to see what’s in store for the class of 2022. He was fined €40,000 and has not appealed the charge. Two properties, Ch. Croix de Labrie and Ch. Tour Saint-Christophe, are taking the INAO to court over their applications for the 2022 classification. In January 2022, Ch. Angélus announced it too was leaving the Saint-Emilion classification, stating the system had become a "vecteur d'antagonisme et d'instabilité". This leaves Ch. It’s 20 years since Eduardo Chadwick gathered some of Europe’s most famous wine writers for a blind tasting – one to rival the famous 1976 Judgement of Paris (when California proved its wines could compete with – and beat – France’s best). Chadwick was convinced that critics were underestimating Chilean wines – for no reason other than snobbery against the nation. The Berlin Tasting pitched Chadwick’s top wines (Viñedo Chadwick, Seña and Don Maximiano Founder’s Reserve) against Bordeaux’s First Growths and a lone Super Tuscan (Antinori’s Solaia). Chadwick charged the late Steven Spurrier with running the event. “I never imagined that what happened was about to happen,” Chadwick tells me. To his and everyone else’s amazement, the 2000 Viñedo Chadwick took the top spot, followed by 2001 Seña, then 2000 Ch. Lafite Rothschild, and 2000 Ch. Margaux – tied equally in fourth place with 2000 Seña. Finally, there was proof that Chile’s wines deserved a place on the world stage.  But, for Chadwick, one watershed moment wasn’t enough. He repeated the tasting, first in São Paulo, then Tokyo – and onward, hosting the same blind tasting 22 times around the world, all with similarly spectacular results for his wines. It takes nerves of steel – and a certain amount of ego – to be willing to risk repeating such a tasting, and yet Chadwick was justly rewarded. His campaign is just one way in which he has forged a path for fine, Chilean wine – with a relentless, dogged determination.  Chadwick is the fifth generation of his family to make wine in Chile. Don Maximiano Errázuriz emigrated from the Basque country and was the first to plant vines in the Aconcagua Valley in 1870. He identified the location, 100km north of Santiago, with its cool ocean breezes, hot summers and rainy winters, as perfect for growing grapes. Operating under the motto of, “from the best land, the best wine”, he planted vines in this idyllic site, near Panquehue, and built a winery – that still stands today.  Gradually, the business grew – and it became the largest vineyard in the world owned by an individual, with 1,300 hectares under vine at its peak in the late 19th century. Despite this early prosperity, Chile’s wine industry didn’t continue to thrive. There was no export market and domestic consumption (which reached up to 80 litres per capita annually) was slashed by severe taxation, while political and economic turbulence, with communist then military rule, put not just the industry, but nation, in crisis. By the early 1980s, wine was cheaper than water and around half of the nation’s vines were ripped out.  It was onto this unstable scene that Eduardo Chadwick arrived. He had initially trained as an industrial engineer before deciding to focus on wine instead, going to study in Bordeaux under the legendary oenologist Emile Peynaud. His father bought the family winery back from the banks, and Chadwick started dusting away the cobwebs, re-opening Viña Errázuriz and – armed with new, technical knowledge – made the first vintage of Don Maximiano Founder’s Reserve, the property’s flagship wine, in 1984. The operation was still rudimentary – with rauli vats (a native hardwood), no temperature control and pergola vines planted on the fertile flats – but it was an early indication of what was possible. Tasting the wine four decades later, it’s held up remarkably well – with surprising vibrancy on the nose and a chiselled, savoury profile of pure Cabernet Sauvignon.  Gradually, Chadwick invested in equipment – stainless steel tanks, modern presses and barrels – and started to plant vineyards on slopes with poorer soils. Alongside this shift, pivotal elections in 1989 saw Chile become a democracy once more – and key figures from the world of wine visited. Soon entry-level wines were being exported by the likes of Oddbins and Victoria Wine. The doors had opened for Chilean wine. Robert Mondavi visited Chadwick in 1991 – and the two men hit it off, sharing an unrelenting drive to push their industry forward, and Mondavi recognised in Chile the potential he had seen in Napa in the 1960s. He knew that his partnership with Ch. Mouton Rothschild (Opus One) had been key to changing Napa’s reputation – and the duo hoped that their own joint venture might do the same for Chile: Seña (literally meaning “signal”) was born. Bob’s son, Tim Mondavi worked with Chadwick on the project and suggested looking for a site closer to the coast in the Aconcagua Valley, in search of even greater finesse, producing the first vintage in 1995.  And Chadwick didn’t stop there. His father had purchased an estate in the Alto Maipo in 1945, home to a polo field (Eduardo’s father, Alfonso, had captained the Chilean team for years). In 1992, Chadwick convinced his father to let him transform the polo field – with its pure gravel soils and 15˚C diurnal swing – into a vineyard, feeling it was perfect for Cabernet Sauvignon. Alfonso died the following year, but the first vintage of this project – Viñedo Chadwick, named in honour of his father – was made in 1999.   Chadwick knew the wines were good – but convincing the world of that fact was the challenge. He’s clear that Chile made a major error in churning out great-value, entry-level wines – good, but not fine wines – a price-point that came to define the nation. “That’s why it was very difficult to convince the audience that we can also produce world-class wines,” says Chadwick. “Chile had no recognition. We had no ratings, no Parker points, no Suckling points.” And so he set about changing that with the Berlin Tasting.  With that event’s market-shifting results (then echoed around the world), he’d created momentum for change. A decade later, he went on to break through another boundary: the 2014 Viñedo Chadwick became the first Chilean wine to earn 100 points (from James Suckling). Just last year, the 2021 vintage was the first Chilean wine rated 100 points by the Wine Advocate. When I sat down with him March this year, it was at an event paying tribute to the two decades that have passed since the Berlin Tasting – featuring early vintages from each estate, and their greatest successes. The 1998 Seña was a particular standout – a cool vintage that today is perfumed, elegant, bright and effortlessly long. Any doubters of Chilean wine were instantly quieted. And, as with the Berlin tasting, the event was being replicated around the globe – the campaign to champion Chilean wine never ending.  When Chadwick started in 1983, Viña Errázuriz had just 10 hectares of vineyard. Today, across their estates, Chadwick farms 900 hectares of vines. He bought out his siblings years ago, when he found they were more interested in dividends than growing and investing in the business. Now three of his four daughters are working alongside him – excited by the potential of coastal sites (where they make the Las Pizarras wines) and a new sparkling project. There has been no shortage of challenges along the way, but they’ve only fuelled Chadwick’s relentless pursuit of recognition for Chile and its wines. “Where we are today is beyond my wildest dreams,” he tells me, and yet it’s only because of his tireless ambition that Chilean wine has made it to this point. Louis XIII has been adored by dignitaries, royalty and the glitterati throughout its near 150-year history. Everything about it, from the grapes to the glass, is of the highest quality. It has been present at some of the most momentous occasions in modern history – served at European royal courts, poured on the maiden voyage of the SS Normandie and Concorde, and quaffed by Agatha Christie on the Orient Express. It has been a favourite of Prime Ministers and dabbed on the wrists of fashion icon Coco Chanel. So what is it about this Cognac that has captured the hearts and minds of so many influential people throughout history? Working from the outside in, Louis XIII is housed in an instantly recognisable Baccarat crystal decanter. Each one is crafted by hand and no two are the same. It comes in a number of formats, from the miniature 5cl to the six-litre Mathusalem. Few bottles look as exquisite or capture the light like the spiked vessel that wouldn’t look out of place in a gallery. The decanter is fashioned after a carafe that was unearthed on a 16th century battleground. Rémy Martin founder Paul-Emile Rémy Martin decided to model his Cognac bottle on the one that was exhumed because he was so taken with the design. This was quite a radical move at the time as Cognac was historically sold by the barrel. The decision paid off as the decanter has since become an international standard for quality and many have attempted to mimic its design. There are numerous nods to history and Louis XIII’s royal namesake on the handblown decanter, including the 20-carat gold neck and handmade fleur-de-lis stopper. It takes a minimum two weeks’ craftmanship to produce a single decanter. This, however, is a mere fraction of the time it takes to produce the remarkable liquid within. Only the finest grapes from the Grande Champagne region are selected to one day become Louis XIII. Each decanter contains approximately 1,200 eaux de vie, distilled on lees, and aged for up to 100 years in traditional Limousin oak casks called tierçons that are over one century old. It’s no exaggeration to say Louis XIII is the work of a Cellar Master’s lifetime. Baptiste Loiseau became only the seventh person to hold the role – and the youngest in the Cognac house’s history – when he took up the mantle in 2014, at just 34 years of age. Despite all the advancements that have occurred throughout Rémy Martin’s history, it is no easier today than it was all those centuries ago for the Cellar Master to know if the decisions he or she makes will affect Louis XIII’s end taste profile. It is Loiseau’s role to ensure these aromas are the same in a century’s time – something that is becoming ever-more difficult in a changing climate with tools that are disappearing before his very eyes. The tierçons, named as such because Rémy Martin’s Cognac used to be transported in barrels of three on a horse-drawn carriage, are crucial to the history and taste profile of Louis XIII. There are tierçons in the depths of the Rémy Martin cellar that date back to 1744 – 20 years after Martin started producing Cognac under his own name. For a long time, the art of coopering these 550-litre tierçons was lost to the ages, as none was produced after 1917. This has become increasingly problematic over the past 20 years as the number of tierçons started to dwindle as one is sacrificed when another needs repairing. In 2012, then Cellar Master Pierrette Trichet made the bold decision to start this age-old tierçon coopering practice again, for fear there might not be any left for generations to come. This project to resurrect the art and safeguard the future of Louis XIII took years to master. The Rémy Martin team enlisted the help of various experts in their field to recreate a tierçon that was faithful to the ones produced in the 18th century. A tierçon must be made from a Limousin oak tree that is up to 180 years old. Once felled, the oak needs to be split and air-dried for a minimum of three years. The new tierçon is then filled with new eaux de vie to mature before it is ready to be filled with the eaux de vie that is one day destined to become Louis XIII. Even after creating countless prototypes, it’s impossible to know exactly how the resulting liquid will taste when it’s ready to bottle in almost a century’s time. From the grapes, to the maturation vessels, and decanter, everything about Louis XIII is rich in history and savoir faire. Louis XIII: the making of an icon

The smallest event can set us on our path. A chance encounter, a favourite book narrated to us as a child, or a popular culture icon that we’re desperate to imitate. For Meghan Ireland, it was a double-page spread in a magazine. She might not remember who it was about, but the subject lit a fire in her that burns just as brightly many years later. “I was like wow, that’s what I want to do,” she says – eyes as wide as saucers – in the back room of the WhistlePig farm-cum-distillery in Vermont. The Whisky Advocate feature on a female Master Distiller showed the second-year Chemical Engineering student and “total chemistry nerd” a career she hadn’t previously considered open to her. “I got super determined after that,” she says. After cutting her teeth in a craft cider role, Ireland joined WhistlePig, or “the playground for distillation” as she describes it, which was under the inimitable stewardship of distilling icon Dave Pickerell. “He was just an amazing guy,” Ireland says. “Big personality and incredibly smart. He was always pushing innovation and experimentation and that’s something that has really stuck with this company.” Pickerell’s untimely passing in 2018 sent shockwaves across the industry, and many still talk about the role he played in the craft spirits revolution and subsequent rye whiskey revival. Many twittered about the fate of WhistlePig without the great man and his boundless creativity. This speculation only intensified after his successor’s short spell at the helm of the company. Today, Emily Harrison and Meghan Ireland head up distilling and blending at WhistlePig and, if their enthusiasm and first whiskeys are anything to go by, then those naysayers were very wide of the mark. “Dave gave us the ability to kind of run wild and create different experimentation options,” Ireland says. This creative energy is palpable in Ireland’s words and evident in everything the team has produced to date. “To this day my CEO asks me on a weekly basis, ‘What’s your new idea? What are we trying this week? What’s the new concept?’ He is always pushing, and he is always asking.” For some, this relentless pursuit might be draining, but it seems to have the opposite effect on Ireland. “To actually be able to explore and experiment with different options has been awesome.” Since its inception in 2015, WhistlePig has gone from a slightly obscure project to a formidable force on not only the American whiskey, but global whisk(e)y, stage. To get the brand off its feet, Pickerell and founder Raj Bhakta were very transparent about the fact they sourced whiskey from elsewhere in Canada. Today, the distillery is making strides in becoming a truly farm-to-bottle rye whiskey. “As much as we can, we want to produce a product that is ours fully,” Ireland says. “We are excited about releasing more and more of our own stuff to show off to the world what we can do here in Vermont.” The 500-acre former dairy farm is in a unique position – conceptionally and geographically. While the land may be fertile and the agricultural produce is verdant, the soil and water are both incredibly hard. As a consequence, the team has continually experimented, adapted and learned the best ways to use its triple terroir – grain, water and wood – to its advantage. “It makes who we are,” Ireland says. “You’re starting with very simple ingredients – rye and water. So, they are going to make up a big part of your flavour profile. I think terroir is huge in any distillation process.” Another huge part of the innovation at WhistlePig and the thing that really excites Ireland is the single finish programme. The Whiskey Blender has carte blanche to pick barrels and make one-off products. Part of her role, and one you sense she relishes, is finding the barrels. Ireland scours barrel libraries and leans on her contacts for anything new and exciting that appears on the market. There’s little she won’t try at least once. “I’m willing to put whiskey into anything,” Ireland says with those wide eyes. “I’m always looking for something different and unique. It’s fun to see when it’s going to hit that sweet spot between under-finished and over-finished.” She has been experimenting with Triple Sec and apricot brandy barrels, and a “couple of different wine finishes” are all maturing when we speak. The way the stills are designed (by Pickerell) allow for flexibility and are perfect for experimentation on both the front and back end. As with any experimentation, there have been some less successful outcomes. “I did a coffee barrel that was awful,” Ireland says, stifling a laugh. “It was bad. I was thinking like Irish Coffees and I thought it could work really well. People drink whiskey and coffee together anyways but that did not turn out good.” She hasn’t abandoned that idea just yet though. “I do think there are some adjustments that I could make and potentially still get a good product on that line of thought, but our first try was not there.” In terms of unicorns, Ireland says there are a couple of different Californian barrels she’d like to try and she’s trying to get her hands on a rosé barrel. “Not a lot of rosés are barrel-finished,” she says. “But I think that would be super interesting and a lot of fruity flavours would come into the whiskey potentially.” For the time being, the Whiskey Blender is experimenting with the many barrels she watches over. “I’m going out pretty regularly and pulling samples and trying to hit that point where I think we get the best flavour out of the different barrels. I’m getting to continue to push the boundaries of what we can put whiskey into.” One suspects it won’t be long before Ireland’s story inspires a whole new generation of chemistry nerds. The state of Indiana is probably best known as the home of the 200-lap motor race, the Indy 500, but it is little known that it is home to America’s first commercial winemakers: a group of French-speaking Swiss settlers, who made their way from the Vaud to the not-yet-a-state of
Indiana in the late 18th century.  Unfortunately, the past two centuries has been unkind to the wine ambitions of the early settlers despite being home to vast swathes of vine-loving limestone; instead, the Hoosier state is more interested in corn and soybeans than grapes and it was in this rural farming environment that a young Jeb Dunnuck grew up, far from the burgeoning winelands of the western seaboard.  Raised in a non-wine drinking family, his late start in wine was clearly no handicap: in 2013, the world’s most important wine critic hired him. “I knew I’d found a younger version of myself,” wrote Robert Parker at the time. Parker had been a lawyer that turned his hand to writing wine reviews in the late 1970s. Dunnuck was a baby when The Wine Advocate was first published but in a similar vein to Parker, he had another career before wine paid the mortgage.  An aerospace engineer by training, he caught the wine bug while working for the listed security and aerospace firm Lockheed Martin in upstate New York. He was – and remains – an outdoorsy type and at weekends he would drive three hours to go rock climbing; en-route he stumbled across a wine store, which led to the start of another hobby and a new career. “I would always stop at this tiny, eclectic wine shop that had a great selection of Bordeaux. I think that was where I probably bought my first bottle of wine, “he says. “My wife Traci was a teacher, and we didn’t make much money at the time, but I still remember hiding $20 to $30 a week so I could buy a different bottle every Friday. Some of the first wines I purchased in any quantity were 1990 and 1996 Bordeaux.” Now firmly ensconced in Boulder, which is to mountain bikers what Bordeaux is to wine lovers, Dunnuck recounts how he went from being an aerospace engineer saving up to buy a single bottle of wine at the weekend to respected wine critic. “In 2008, I created the TheRhoneReport website and started writing professionally about wine. I was lucky that I knew web programming, so I designed an online database and built the original site over a weekend. I still use the same database today,” he says. “I would work during the day at Ball Aerospace, then write for The Rhone Report from about 8pm to 2am every night. I did that for five years.” His work ethic and output clearly impressed: in 2013 an email appeared in his inbox from Robert Parker, asking Dunnuck to work for him and you don’t say no to Parker.  
The Parker Years The remit at The Wine Advocate included California, Washington and southern France, including the Rhône, and his lively tasting notes made a refreshing change. “It’s funny you say that, as I truly can’t stand flowery prose,” says Dunnuck.  “I approach the job with an engineering viewpoint as opposed to that of a writer; I’m here to solve problems and the purpose of JebDunnuck.com is to help subscribers find wines they like. You do that by tasting as broadly as possible, writing straightforward vintage reports, and doing your best to
describe and give candid opinions on the quality of the wines. That is the goal”.  But in 2017, just four years later, Dunnuck handed in his notice and went solo. “I loved working at The Wine Advocate, particularly in the early years, when Parker was heavily involved. However, I disagreed with the direction of the company and management, and thought it wasn’t a good fit for me as time went on,” he explains. Within months of
handing in his resignation, JebDunnuck.com was launched.  He retains the principles of an Advocate reviewer, basing his business on a subscription model and paying his way rather
than relying on wine associations or producer groups to fund his trips. 
Dunnuck Drinks 
While he might be known for his love of all things Rhône-related, he has now included Bordeaux into his roster of regions and publishes major reports, which include reviews of up to 1000 wines at a time, as well as smaller articles on other regions and individual producers.  But what we all want to know is what’s in his personal cellar? “I’m a Francophile so my cellar is mostly Rhône and Bordeaux,” he says, revealing he’s just bought a case each of the 2017 Janasse Châteauneuf-du-Pape Cuvée Vieilles Vignes, 2016 Château Sansonnet from Saint-Émilion, and the 2017 Domaine du Pegau Châteauneuf-du-Pape Cuvée Réservée, “but I drink plenty of wines from California’s Central Coast, Sonoma, Napa Valley, Washington, Italy and Spain.” What Rhône vintages should FINE+RARE’s clients be opening? In the Syrah-dominant 
northern Rhône, the wines of the noughties are all ready to be opened. “For lovers of young wines or those with little patience, 2014 is an early drinking, moderately concentrated vintage that has lots of upfront charm. I think one of the greatest vintages ever for the Northern Rhône, the 2015s are massive and structured wines that will reward bottle age. However, Crozes-Hermitage, some Saint-Joseph, and some Cornas are approachable today. Meanwhile, the 2016s are classic, elegant wines that will have early appeal as well yet also age
gracefully.” Vintage-wise, it’s not such a different story in the southern Rhône, home to the appellations of Châteauneuf-du-Pape, Gigondas and more. If the label states 2009 or earlier, the drinking window has opened up and you should start enjoying; yes, you can open your 2010s but
there’s no rush. “Looking at younger vintages, the 2015s and 2016s should probably be held for a few more years, although there are plenty of 2016s drinking nicely, albeit in a youthful sense. 2016 is a great, great vintage for the southern Rhône, and the top wines are going to reward bottle age.” Dunnuck’s vintage is 1975. He’s clearly entered his working window in the past 10 years but will continue to hold and potentially improve for another 20 to 30 years. Based on the history of his home state’s wine scene, it’s clear he is already one of Indiana’s finest wine

Bordeaux 2019 En Primeur As the 2019s from Bordeaux begin to release, Dunnuck gives his picks for lesser known producers in the region. Looking in Bordeaux on the Right Bank and stepping outside the well-known names, some gems would be Château Badette, Château Sansonnet, Tour Saint-Christophe, Quinault l’Enclos, Château Barde-Haut, Château Ripeau, La Dominique, Clos Saint Julien, and Clos de Sarpe, among others. I absolutely love Jeremy Chasseuil’s Pomerol from Château Feytit-Clinet, and Château Laroque, under David Suire, has taken off as well.  On the Left Bank, some estates on the uptick would be Chateau Pédesclaux, Château Gloria, and Château Saint-Pierre in Saint Julien. I think Château Rauzan-Ségla is making their best wines ever while Château Labégorce and Marquis d’Alesme Becker, both under the helm of
Marjolaine de Coninck, are making brilliant wines today. Some other hidden gems would by Château Charmail, Clos Manou, Château Le Coteau in the Arsac region of Margaux, and Château Marojallia, just to name a few. While the US consumer doesn’t like second wines, given the incredible selection being made by the top estates, I’d wager the second wines today rival the grands vins of the past. The ship might have sailed already, but people should jump on the wines of Les Carmes Haut-Brion. Guillaume Pouthier is doing an incredible job there and is making world-class wines. I also think the dry whites from Olivier Bernard’s Clos des Lunes, which are based on Sémillon from old vines in Sauternes, don’t get the recognition they deserve. For a long time, Tuscany was known merely for its squat jugs of rustic Chianti, almost inevitably in quaint straw baskets; thin, insipid wines that are a shadow of what the region has proven it can produce today.  While Chianti had once been known for making fine wine – having been the first region to have geographical limits defined for wine production back in the 18th century – its reputation had, by the mid-1900s, been ruined. The area for production had been expanded in the 1930s, far beyond the historic heart of the region, encompassing lesser vineyards. The appellation rules encouraged producers to favour quantity over quality, with yields as high as 85hl/ha allowed, and specifying that red blends had to include a minimum 10% (and up to 30%) white grapes, with as little as 50% Sangiovese. Winemakers took advantage of high-yielding Trebbiano to bulk out the once-famous wines.  But one man changed all that. Enter Mario Incisa della Rochetta, a man who had been brought up tasting Claret with his grandfather. In 1944 – missing the taste of Bordeaux and inspired by the good wines his friend Duke Francesco Salviati was making near Pisa – he decided to plant a vineyard on his wife’s Tenuta San Guido estate in Bolgheri, on Tuscany’s coast, two hours west of Siena.   Identifying a stony site that sat at over 1,000 feet above sea-level, he took Cabernet cuttings from Salviati, and planted his first vines. The resulting wine was consumed only by family and friends, seen as overly green by the locals. But Incisa della Rochetta was encouraged by the results, and decided to plant more vines lower down the slope, and closer to the sea, in 1965.  His nephew Piero Antinori – who had recently taken over the family business – realised the potential of the wine, and the Antinori winemaker Giacomo Tachis started making the wine. Influenced by time in Bordeaux, Giacomo filled the cellar with new French barriques – small barrels that were a radical move away from Italy’s traditional large, old casks made with Slavonian oak. In 1971, Piero convinced Mario to release the 1968 vintage commercially and a star was born: Sassicaia.  Being 100% Cabernet Sauvignon, aged in new French oak and from Bolgheri – a region that at the time didn’t have a DOC – Sassicaia was labelled with the lowest official classification for Italian wine, “vino da tavola” or table wine. It rapidly won praise from critics and consumers, commanding a serious price that was at odds with its lowly classification. Where Sassicaia led, others followed. In 1978 Piero Antinori released the first vintage (1971) of Tigananello – a blend of Sangiovese and Cabernet grown in the heart of Chianti Classico. Bordeaux authority Emile Peynaud advised on the project, suggesting that the appellation’s stipulated white grapes were abandoned and that it be aged in new French oak. Falling outside Chianti’s rules, it too was sold as a vino da tavola.  Piermario Meletti Cavallari founded Grattamacco in 1977, and was the first to feature Bolgheri on the label, featuring this then little-known region in larger font than even the wine’s name itself. Piero Antinori’s brother Lodovico established Tenuta dell’ Ornellaia in 1981, planting Cabernet and Merlot. A flight of Chianti producers followed suit – ripping up the appellation’s rulebook to make cuvées with international grapes like Cabernet, using 100% Sangiovese, and/or French oak: Le Pergole Torte, Flaccianello, Cepparello, Percarlo, Fontalloro and more all pushed the boundaries of what was possible in Tuscany – but didn’t (and couldn’t) bear the region’s name on their labels. These wines – the “Super Tuscans”, as they became known – were soon being recognised the world over. In 1978 Hugh Johnson organised a blind tasting of the world’s best Cabernets for Decanter. Pitted alongside the First Growths, it was Sassicaia that came out on top. The 1985 vintage of Sassicaia became legendary when Robert Parker – who had just risen to fame – gave it 100 points. In 2001, 1998 Ornellaia was named Wine Spectator’s Wine of the Year. These wines were putting two fingers up to Italy’s appellation system as they sold for the same price as Grands Crus Classés, despite their vino da tavola status.  In a bid to stem the tide of these ultra-premium table wines, the Italian authorities started to make changes. In the late 1990s and early 2000s, Chianti amended its appellation rules to try and reclaim the wines, allowing more variation in the winemaking, with no white grapes required and allowing 100% Sangiovese wines. But the damage was done, with the Super Tuscans already established as their own brand. Few returned to the fold to use the Chianti name on their label – a region that producers felt didn’t, then or now, have a reputation that aligned with the quality of these world-class wines.   The likes of Sassicaia, Tignanello and Ornellaia drew the international wine market’s eye to Italy. Bold, big, rich wines that won critics points, the Super Tuscans arguably turned the tide for the nation, garnering praise – and proving that Italy’s wines could compete on the world stage. Today, critics and consumers are looking beyond these iconic names to explore Italy’s extraordinary viticultural heritage, with the terroir-driven styles of Barolo, Barbaresco, Montalcino, Etna and more starting to find the spotlight. But Tuscany’s rebellious streak continues, with a new wave of producers – such as Bibi Graetz – producing wines that are bottled defiantly as IGT Toscana. While there’s plenty more competition, the Super Tuscans remain some of the country’s finest and most collectable wines. The Super Tuscans you need to know While there’s no set definition for a Super Tuscan, and there are many that could take the title, here’s our pick of the most famous wines. Sassicaia: The first Super Tuscan, made by Tenuta San Guido, in Bolgheri; it’s a blend of Cabernet Sauvignon (85%) and Cabernet Franc (15%), and is the only single estate in the whole of Italy to have its own DOC, Bolgheri-Sassicaia. Tignanello: A rival to Sassicaia in terms of fame, and also put under the sporlight by Piero Antinori, Tignanello comes from Chianti. It was the first to blend Sangiovese with Cabernet. Solaia: Tignanello’s sibling, Solaia is the reverse in blend – with Cabernet taking the lead, complemented by a smaller proportion of Sangiovese. Ornellaia: Created by Piero Antinori’s brother Lodovico, with advice from André Tchelistcheff, it’s a Cabernet-led Bordeaux blend. The property has changed hands over the years and is now owned by the Frescobaldi family. Masseto: The other wine created by Lodovico Antinori: although planning originally to work just with Cabernet, Tchelistcheff identified the hill of Masseto as ideal for Merlot. The fruit from this site was bottled separately as a pure Merlot for the first time in 1986 (although the 1987 was the first vintage released), and today Masseto operates separately from the Ornellaia estate, having its own winery and identity. Grattamacco: Another of the earliest Super Tuscans, this is Cabernet blended with Sangiovese. Piermario Meletti Cavallari purchased an abandoned vineyard in 1977 which was all Sangiovese, but he later grafted over with Cabernet. He was one of the first producers to feature Bolgheri on the label of his wine. Montevertine Le Pergole Torte: This was one of the earliest expressions of pure Sangiovese from Chianti, aged in French and Slavonian oak. The first vintage of this was 1977, a blend of fruit from the estate’s best vineyards. Fontodi Flaccianello della Pieve: The first vintage of Flaccianello was 1981. Originally a single-vineyard expression, since 2001 it’s been a blend of the best grapes from the estate, but remains 100% Sangiovese, classified as Colli Toscana Centrale. The proportion of new oak has been toned down, and a portion of the wine goes into amphora. Isole e Olena Cepparello: This pure Sangiovese was first made in 1980, and today only sees around a third new oak, with a small proportion of American oak. It’s notable that it is bottled both under screwcap and cork, with Paolo di Marchi a strong believer in the benefits of screwcap. San Giusto a Rentennano Percarlo: First made in 1983, this 100% Sangiovese comes from the estate’s best vineyards. Fèlsina Fontalloro: Made with vines falling in Chianti Classico and Chianti Colli Senesi, this pure Sangiovese was first made in 1983. Castello di Ama L’Apparita: Narrowly beating Masseto to be the first 100% Merlot made in Tuscany (with the first vintage 1985), the 1987 vintage of L’Apparita famously beat Pétrus, Le Pin and several other Merlots in a blind tasting which was judged by a panel including Michel Rolland in 1992. Querciabella Camartina: First made in 1981, this was originally a blend of mainly Sangiovese with Cabernet in support, but the blend has reversed over time. Bibi Graetz Testamatta & Colore: Bibi’s top wines are elegant expressions of Tuscany’s indigenous grapes, sourced from old vines at high altitudes. The Super Tuscans: everything you need to know

When people say they’ve put their blood, sweat and tears into something, more often than not, it’s a figure of speech. This is not the case for Bimber Distillery founder Dariusz Plazewski, who has put everything into the build of his dream Speyside distillery, Dunphail. The day before we speak, Plazewski was on the roof of one of his new distillery buildings, mucking in and making sure the mammoth project that was a lifetime in the making stays on track.   The Polish-born Plazewski is a third-generation distiller – or more accurately, moonshiner – who emigrated to London 20 years ago. After observing the English craft distilling boom from afar, the trained architect seized the opportunity to put his family’s legacy and knowhow to good use and set about building Bimber, a single malt whisky distillery based in West London. Bimber’s inaugural bottling, The First, sold out within three hours of release in 2019 – and demand has far outstripped supply ever since.    Fast forward three years and Plazewski is mere months away from realising his dream of producing a single malt Scotch whisky. But it hasn’t been easy.   “There are lots of challenges,” he tells me matter-of-factly. When we catch up, after two aborted attempts, the Master Distiller sounds ever-so-slightly weary – and it’s not hard to fathom why. Today, he is speaking from London, where he’s been “sorting out a few things” at Bimber. He’s boarding a flight back to Scotland in a couple of days and then he’s taking a much-needed holiday – where he confesses he will be on email constantly.   Rest is not in his nature. (Plazewski has been pinballing from one project to the next for decades. By the end of 2022, he says he will have “given up” his other business and solely focus on spirits.) Nor is adhering to the status quo.    Since founding Bimber in 2015, the Master Distiller has prided himself on being a bit of a renegade. Where others have embraced modern whisky-making practices, Plazewski has been staunchly traditional in his approach – and it has served him exceedingly well. “Whisky was always my passion and when I found out that there was a craft movement of whisky and gin distilling, I just started researching,” he tells me. “It took me a long time but I wanted to do something different. I wanted to always do something which was a bit old-fashioned.”  Plazewski’s father and grandfather before him (illegally) made wine, spirits and beer in his native Poland – Bimber translates as “moonshine” in Polish – and Plazewski was an eager protégé with a natural talent from a young age. I refrain from asking how young.   “The good thing is that I understand all the production, all the process, all the fermentation, and how to make alcohol,” he tells me. “Not only whisky but how to make any alcohol really. Sense of smell, touch, and all this just naturally comes to me.”   Plazewski says his fate was sealed the moment he travelled to Scotland and fell in love with Speyside single malts. Dunphail was always going to happen – he just didn’t know when. Starting his (legal) distilling career with Bimber was a shrewd decision. English whisky was then a relative unknown, so Plazewski used this scene as his sandbox to prove to himself and others that traditional whisky production should not be consigned to the history books.   Bimber was, and for the time being still is, a small-scale traditional whisky-making operation. Local barley is grown on a single farm in neighbouring Hampshire. It is floor-malted at Britain’s oldest maltster, Warminster Maltings, and hand-mashed. The two copper pot stills are direct-fired (with a flame, as the name suggests, rather than the more modern and efficient method of steam) and fermentation times are twice the industry average at seven days.  These practices are astoundingly rare in today’s modern whisky world. The majority of producers abandoned floor maltings (the method of malting grain by hand on large malting floors) in favour of industrial malting processes and did away with direct-firing stills (in favour of steam) decades ago, deeming them inefficient and costly. While it is possible to find distillers who adopt some of these techniques – notable examples being Laphroaig, Glenfarclas and Bowmore – it is incredibly rare to find a producer who is able or willing to apply all these labour-intensive and budget-zapping practices.   “I will never be a distiller without floor maltings,” he says physically baulking at the idea of producing whisky any other way. “Never. No. For me, it is crucial,” he adds.    With Dunphail, Plazewski is going one step further than Bimber and building his own traditional floor maltings on-site. This will put Dunphail in a highly exclusive group, and the move has received mixed responses from Plazewski’s peers.   “For me it is very important,” Plazewski says. “I know many people said, wow are you crazy because this is hard work, this is lots of involvement, why are you doing it?”  I can’t help asking him the same. To which he says: “Because nobody is doing this anymore and I want to continue this craft, I want people to see how the whisky was made before. I think it is going to be good fun and I think this is going to be a great feature for our distillery.”  In addition to floor maltings, Dunphail’s stills will also be direct-fired – Glenmorangie was the first to install steam-heated stills in 1887 and countless others followed until only a handful of direct-fired producers remained. Plazewski is the first to acknowledge the practice of heating stills in this traditional way is far less efficient and costly but for him it was non-negotiable and vital to produce the highest-quality Speyside whisky possible – fruit-forward, oily and medium-bodied. He is also in the minority sourcing Dunphail’s barley and peat locally. There are undoubtedly easier routes to produce whisky but the mere suggestion is sacrilege to Plazewski.  Steadfast on his goal, Plazewski set about finding the perfect location to produce traditional single malt Scotch whisky. After years of searching, he settled on a location in the heart of Speyside – a typically renegade move as the majority of new distilleries have been built outside this iconic region. He explains: “The location was really difficult and challenging as well to be honest.”  “I love Speyside – it’s my favourite part in Scotland. First of all, it is a great area because it has got microclimate, so it’s not too cold there and it’s not too rainy. And it’s pretty sunny.” Additionally, he says: “Speyside whiskies are my favourite.”  When asked if he feels the weight of this tradition or pressure to produce a stand-out Speyside whisky in one of the most densely populated whisky-making regions in the world, he says not.   “We are tiny. We’re not going to be competing with the big, established brands. Most of the new distilleries are not built in Speyside, they are mostly built in Fife area. And not many are really going the route we are with the floor maltings and old-fashioned techniques we are trying to apply.”  In addition to the many challenges that come with building a distillery to a blueprint that no longer exists, Plazewski has embattled with supply chain issues following Brexit, Covid and now the war in Ukraine. It’s a minor miracle – and a testament to the tenacity of Plazewski – that the Dunphail build is on schedule and production is set to begin, as planned, at the end of the year.   When asked how he feels, Plazewski pauses for a moment, takes a short intake of breath and hurriedly says: “It’s amazing. It’s hard work. I need a break. That’s why I need this holiday because it’s not only physical work, it’s the mental as well – planning everything.”  He pauses again. “It’s been a stressful and challenging time. But we are on schedule, we’ve planned this well.”  After Dunphail is up and running, and Plazewski has trained his dream team to the standard of Bimber, you wonder what’s next. You sense he won’t just stop after realising his Scottish dream, and that there will be a new North Star.    When asked, he responds to the question with a wry smile, indicating this is not the first time it has been posed to him by others, or even himself. “I would say yes, I’m done after this, but people I know and people around me are saying to me, you are never going to stop, you’re going to find something else.  “But I would say I think I’ve done my dream and when this [distillery] is going to be open, I’m thinking to really concentrate and not do anything more. I don’t think I will put too much pressure on myself and my family again.” A seed of doubt creeps in and then he says resolutely: “No, this is it, it’s going to be my dream, it’s going to be super exciting and I’m not going to go for anything else. I’m just going to enjoy the time and share the drams.” We’ll ask him again in five years’ time.   For the time being, at least, Plazewski (and the wider whisky world) is satiated with turning modern whisky-making on its head and bringing fiercely traditional practices back to one of the oldest and most prestigious whisky regions in the world.   Browse all Scotch whisky or read more Editorial
