Every now and then, the word ‘singularity’ is used to describe a particular wine that stands apart, for whatever reason, from other wines of its type. But just what is singularity, and how can wine express it? Wine writer Tamlyn Currin investigates.

Vega Sicilia is undoubtedly Spain’s most famous winery; a true icon in fine wine with a history dating back to 1864. Its success in retaining such a reputation, and in almost complete isolation in the Ribera del Duero region of Spain, is testament to the quality and consistency of its production, although its history has not been without its challenges. Vega Sicilia claims to be one of the longest-aged and longest-lived red wines in the world, with its flagship Unico capable of maturing in bottle for well over sixty years under the right cellar conditions. Developing its style in such solitary conditions has created a wine distinct from any other and whilst the Ribera region has flourished with the establishment of wineries such as La Pesquera in the 1970s and more recently the cult wine of Pingus, Vega Sicilia today remains at the apex of the appellation.  We explore the history of Vega Sicilia, the secrets behind its success and the changes afoot as it attempts to retain the traditional methods it has become famous for whilst modernising the winery and updating its processes. We also explore the contrasting range of wines it produces from the Valbuena to the Unico Reserva Especial: Vega Sicilia’s nod to the traditional Spanish practice of producing multi-vintage premium blends. The history of the estate The estate that would become known as Vega Sicilia was founded in 1864 by Don Eloy Lecanda Y Chaves, a Spanish vigneron who inherited the property in 1859. After visiting Bordeaux he brought cuttings of the Bordeaux varietals of Cabernet Sauvignon, Merlot, Malbec and Carmenere, as well as Pinot Noir, and planted 18,000 vines at the estate in Ribera del Duero alongside the native varietal of Tinto Fino (Tempranillo). By 1882 he had planted 500,000 vines on the estate, at the time known as Bodegas Lecanda.  The introduction of Bordeaux varieties was perhaps not that unusual at the time, since the Bordelais were becoming more and more influential in Spain (most notably in Rioja) having disbanded their operations in Bordeaux following the phylloxera outbreak and were actively looking for alternative regions to grow their grapes.  However, in Rioja, the Bordeaux varieties were soon replaced by the native Tempranillo which proved a much more reliable and profitable choice. Whilst Don Eloy Lecanda Y Chaves initiated a winery that was to change the history of fine wine, he was initially using the grapes to make brandy rather than still wine. Although the brandy was well received amongst the aristocratic families (no doubt piquing the interest of the Herrero brothers), the estate struggled financially to make ends meet and he died in 1894 never to witness the success of his venture.  The property was bought by the Herrero brothers in the early 1900s who renamed it Vega Sicilia. As phylloxera eventually reached Rioja, the négociant Cosme Palacio was looking further afield to maintain supply for his customers. On discovering Vega Sicilia, he immediately rented the property from the Herrero brothers.  He brought with him winemaker Domingo Garramiola Txomin who introduced the Bordeaux techniques of ageing wine in barrique as well as extending the élevage. He also initiated bottling the wine on the estate (Cosme Palacio was previously shipping the wines in bulk to Rioja).  The Herrero Brothers were a well-connected upper-class family who were galvanised to produce a wine of exceptional quality no matter the cost, to sell to their aristocratic friends. This quest for quality combined with the skills of Domingo Garramiola Txomin, as well as the unique combination of Bordeaux varieties and Tinto Fino (thanks to Don Eloy Lacanda Y Chaves), was the perfect recipe for producing Spain’s first iconic wine – Vega Sicilia Unico. The first vintage of Unico was produced in 1915.  Thanks to the connections of the Herrero brothers, within two decades Vega Sicilia had become the most revered winery in Spain. Even at this time the wine had built up a reputation for its extraordinary ageing capacity. At Vega Sicilia the Bordeaux varieties became a key component to their flagship wine of Unico and have remained in the blend right through to the present day. Throughout this time, the property became almost a self-contained village, with a school and chapel on site and many of the families working at the winery and living on the estate. Despite the winery changing hands a number of times over the last century, Garramiola’s legacy has lived on through the winemakers that followed in his footsteps; figures like Martiniano Renedo, who was initially Garramiolo’s assistant, and especially Jesús Anadón, who was instrumental in maintaining the quality and reputation of the wine through the middle of the 20th century.  Amazingly there are workers on the estate today whose families have worked at the winery for generations. Today the master cooper at Vega Sicilia, along with his brother Jesus Yanez, is the fourth generation of his family to work at the property. The winemaker between 1968 and 1998, Mariano Garcia, was the son of one of the farm workers on the property.  Despite its global reputation, its exclusive allocation list and long history, the winery and vineyards went through bouts of dilapidation during the 1950s, through to the late '70s, whilst at the same time producing some of the most legendary vintages. On purchasing the property in 1982 the Álvarez family began to make huge investments into the estate, renovating the winery and carrying out an extensive replanting program in the vineyards. 1982 was also the year Ribera del Duero was awarded its DO appellation status and no doubt helped further promote Vega Sicilia as the historical icon of the region. The winery and the appellation has never looked back since.  In the vineyard Vega Sicilia is situated on what is known as the “golden mile”, a stretch of road between Pañafiel and Tudela de Duero, where the prestigious wineries of Vega Sicilia, Pingus and Pesquera are all situated. Driving through, it is a somewhat underwhelming sight as far as vineyard vistas go, so much so you could almost pass through it without noticing.  Being an altiplano there are no sweeping mountainous views, you only feel the altitude from the freshness of the air. In the higher vineyards of Soria at the edge of the Ribera appellation you are rewarded with more vistas, as well as a sense of history with evidence of prehistoric cave-like dwellings where farmers sheltered from the extreme climatic conditions of this largely desolate region.
 Whilst there are pre-phylloxera ungrafted vines dating back over 100 years dotted around the region, the vines at Vega Sicilia - with vineyards at 700 meters - average around 35 years of age. Vega Sicilia have an extensive replanting scheme in their vineyards preferring the quality of their fruit in their mid-life as opposed to old age, with typical vine age in Unico around 60-65 years old, with the younger vines going into the Valbuena cuvée. The high altitude and continental climate mean extreme conditions are at work in the vineyards. Winters can be very cold whereas the summers can be fierce. Most notably in regards to grape growing, due to the altitude, there is a huge diurnal shift in temperatures from day to night helping to retain the acidity and freshness in the grapes whilst reaching high levels of ripeness. The main grape in all Vega Sicila wines remains the Tinto Fino (the particular clone of Tempranillo) distinct to the region. The Tinto Fino is said to produce smaller berries with higher concentration of tannins compared with the Tempranillo grown in Rioja. The Unico also has a proportion of Cabernet Sauvignon in the blend (anything from 6-20% in more recent releases) with a higher proportion in older vintages. In the Valbuena, the majority of the blend is Tinta Fino with a small amount of Merlot (typically 5%) . The property is huge in scale with 200 hectares of estate-owned vines producing anything from 40,000 to 100,000 bottles of Unico each year depending on the vintage.

 Unico  The style of the flagship cuvée of the winery has remained virtually unchanged since its inception in terms of production, although assemblage has modernised. Élevage times have reduced and the influence and proportion of Bordeaux varieties has become less in more recent releases.  In the past, Unico was only made using huge 40,000-litre fermentation tanks (this was all that was available at the winery) therefore in a difficult vintage, if this sort of volume was not possible at the quality level they expected, then no Unico would be released that year. Since 2010 the winery has introduced smaller 8,000-litre tanks, enabling smaller micro-vinification of their wines and suggesting a release of Unico every year (in varying quantities) is more likely. The winery today operates at a spec similar to the top estates in Bordeaux. They have introduced 81 separate fermentation tanks allowing them to carry out intra-plot fermentation. They have introduced highly sophisticated sorting tables, there is more temperature control of the wine and the winery is now completely gravity fed enabling greater precision when it comes to winemaking.   Following fermentation, the wines destined for Unico are blended in small oak barriques (50% French oak / 50% American oak) for 12-24 months depending on the vintage. The French oak is 100% new whilst the American oak, coopered on site, tends to be one to four years old. Following barrique ageing, the wine is then transferred to large old oak casks where it typically matures for five years before being bottled and aged further prior to release. Unico is typically released at 10 years old. Valbuena 5° The Valbuena typically comes from the younger vines of the estate and is aged in oak in barriques for 12-18 months before being transferred to larger old oak casks for a further 18 months prior to bottling. It is then aged for two years in bottle. Valbuena is typically released at five years old. Unico “Reserva Especial” The Reserva Especial is the mythical bottling that initiated the Vega Sicilia legend. It is made up of choice parcels from a blend of vintages (in recent releases it tends to be select parcels from three vintages). Prior to the 2001 release, details of the blends of older bottlings are not very easy to come by. With only 15,000 bottles produced this is the rarest cuvée from Vega
Sicilia and a nod to the traditional multi-blend wines that were typical prior to vintage specific bottlings becoming more popular in the mid to late 1800s. Explore more Editorial

Xavier Vignon could best be described as a maverick winemaker whose inquisitive mind and extraordinary experiments have taken him on journeys all around the world, working on some of the must cutting-edge developments in today’s burgeoning wine scene. Initiated into oenology from a scientific background he has always had the benefit of operating free from the shackles of tradition yet now in his 40th year as a winemaker, his wealth of experience has seen him integrate his science with sensibility, developing an appreciation of producing wine in its most natural form.  We spoke to an initially noticeably weary Xavier Vignon, who is still recovering from a fairly serious bout of COVID-19. However, as soon as he starts to talk about his current projects he becomes distinctly more animated as he begins to describe all the fascinating projects he is currently working on.  This is a vigneron who clearly cannot stay still for long and has a huge drive and enthusiasm for his work. In fact, in his early days as a vigneron he was on the move all over the world working in Australia, South Africa, New Zealand, California for half of the year whilst returning to his native France to work through the harvest in the northern hemisphere. He carried out 40 harvests in 20 years.  His winemaking career started in Champagne before exploring the other wine regions of France, working in Alsace and Bordeaux among others. Coming from a family of stonemasons whose philosophy was to travel when young, he was encouraged to explore the world before settling down. These travels and the variety of experiences working in oenology from one country and climate to the next are surely a vital part of the puzzle for Xavier’s success as a winemaker. It was the Rhône Valley that finally stopped him in his tracks. Admitting he had never really
been interested in the wines of the Southern Rhône, hence the reason he arrived there later in his career, only to find that it had everything he was looking for. A huge variety of terroirs, varying altitudes, an array of grape varieties. This meant lots of freedom in blending (reminding him of his work in Champagne) lots of work on tannins (harking back to Bordeaux) and working in warmer climates of the new world. He was well-prepped to take on the region, setting up his own laboratory and consultancy practice initially advising for 20 – 25 winemakers before it expanded to over 500 in the region. Minerality, water and wine Xavier’s technical skills certainly helped many traditional vignerons to develop their wine
for global export but it also gave Xavier a tremendous opportunity to explore the multitude of wines throughout the region. Xavier became fascinated with things that were clearly evident in tasting so many wines of the region, which his scientific background couldn’t always explain. “Minerality” for example, is a term bandied around wine circles everywhere you go. We all know it exists but science cannot tell us what it is. It is not clear that we even all think it is the same thing, Xavier claims.  He was part of an extensive global research paper exploring what consumers and wine professionals identify as “minerality”. The study interviewed 5,000 consumers and 5,000 professionals resulting in no clear evidence that people were talking about the same thing. The only clear answer was that Chablis had minerality! Half the study thought more about smell, 50% thought about flavour. There is no definition still states Xavier. But this began his fascination with water and for him the key to understanding the secrets of minerality – despite him knowingly accepting he had no scientific data to prove it. This was his first step towards trusting his sensibilities over scientific analysis. For him you need to look to water to understand minerality. 85% of wine is water, water is
a huge proportion of what we taste, he states. Xavier looks to mineral water companies, even beer and whisky companies who have invested much more analysis on the affects of water, than the wine industry, largely because they have more money to do so, but also because water plays a much bigger role in their taste profile (in beer water is 90-95% water compared to wine which technically is 100% grape juice).  In their analysis of mineral salt, bottled mineral waters from different parts of the world have distinctly different levels of each mineral affecting the flavour of the water. Beer companies have also accepted that their beers made in different factories around the world taste different depending on where they are made because of the composition of the water. Whisky famously is obsessed by the quality of its water in regard to the final flavour profile of each distillery.  "So why not wine too?", asks Xavier. In different parts of the Rhône he identifies how high levels of silica in a wine makes the wine taste more acidic. How different chloride minerals provide a flavour of salinity in the wine, magnesium creates bitterness and so on. Scientific analysis doesn’t register the difference, but the difference is extraordinarily apparent when tasting. The effect of water is intrinsic, Xavier believes, to the strong mineral flavours of the Southern Rhône. The wines of the region could never taste like they do elsewhere because of the effect of the mistral. The mistral wind in places (particularly Châteauneuf-du-Pape) is so strong that it evaporates water from the berries, heightening the concentrations of mineral salts the grapes have absorbed in the water from the ground whilst the water evaporates from the berries. Xavier believes Gigondas, where the vines tend to be more protected from the mistral due to the protection of the hills, is less mineral for that reason. Xavier’s fascination with the effects of water on wine was a big reason why he began his
Arcane series, a set of one-off wines that are produced with minimal manipulation. He looks back at some regions he has worked in, stating parts of California and Australia require one to one and a half tonnes of irrigated water just to produce one bottle of wine. This is crazy! Whilst we have the science and technology for this to work, it doesn’t make sense. The Arcane Series of wines by Xavier The first wine made from the Arcane series was called “Le Diable” – translates as “the devil”. It came about when one of the vignerons he was advising took him to a high altitude Mourvèdre vineyard. The winemaker now in his eighties had struggled his whole life to get the Mourvèdre this high up to ripen, never achieving the results to use in his final wine. Xavier convinced the vigneron not to harvest the grapes with the rest of his crop, to leave the grapes on the vine and to see what happens.  It was 2015, a very late harvest already Xavier recalls but this extended Indian summer caused something in the vineyard they couldn’t believe. As the grapes continued to ripen and sugars increase, the acidity also started to go up as well! They had never seen anything like it. Xavier convinced the grower to sell him the grapes and produced the wine made just from these grapes. Xavier took the wine back to the elderly grower, who on tasting the wine began to cry. In his lifetime he had never been able to produce a wine from the vineyard, particularly not a 100% Mourvèdre!  Xavier named it Le Diable, the nickname of the Mourvèdre in the Southern Rhône because it was so difficult to ripen. Xavier knew that what happened in 2015 was unlikely to be repeated. This was a wine that made itself. It was vines in the perfect place at the perfect time and this is what he wanted the Arcane series to represent. Ever since, the Arcane series (now in its 6th and 7th cuvee to be released in the next few weeks) are complete one offs never to be repeated. The story behind the Arcane series informed Xavier’s winemaking philosophy ever since. Whilst he believes we can use science and technology to manipulate wines, he wanted to move away from this, preferring nature to tell him where and when he should make the wine. That hasn’t stopped him experimenting however and there are plenty of other cuvées that
show off Xavier’s inquisitive scientific brain operating at full speed. He is currently working with a winery in Turkey that wants to produce a wine free of any manipulation. Not only organically and biodynamically grown, natural yeasts etc but they even want the fermentation and maturation vessel to have no impact on the wine – he came up with the “vinarium” – a dark glass tank for fermentation and maturation – a natural product that does not infuse any flavour in the wine.  His next experiment is to get rid of closures altogether by extending the neck of the bottle and melting the glass at the top to seal the wine without any other material such as cork to affect the flavour. He eventually wants to create individual wines from individual vines!  He is experimenting with ageing wines both in the ocean and with his own invention of submerging a tank of wine within another bigger tank of wine. He does this with his Châteauneuf-du-Pape Cuvée Ange, comparing the process to a baby in a womb, completely protected from the outside world.  He believes you can age wine like this for 50 years without any need for sulphides or racking because there is 100% humidity and an even atmospheric pressure on the wine all the time. It’s an expensive operation and for the moment not possible for all his wines. But the level of experimentation and inquisitiveness gives you a good impression the sort of lengths Xavier will go to to push the boundaries of modern winemaking. He has no problem blending a Châteauneuf-du-Pape with a Côtes du Rhône village cuvee to make it a better wine only for it to be downgraded to a Vin de France because a Châteauneuf-du-Pape cannot be included in a blend and be titled Côtes du Rhône Villages. His interest lies in how it tastes, accentuating the multifaceted variety and complexity that exists in the Southern Rhône, rather than the traditional restraints of the appellation system. Based in the Southern Rhône for the last 25 years, Xavier Vignon has amassed a huge following from critics and consumers alike, with his wines often scoring in the high nineties, yet remaining extraordinary value. We caught up with him to find out the secrets to his success

Xavier Vignon: A Rhône radical

It was the vision of Jacques Perrin in particular – who farmed the property organically from 1950 onwards – that cemented Châteauneuf-du-Pape’s Château de Beaucastel reputation. Today his sons – Jean-Pierre and François – are at the helm, with fifth-generation Marc, Pierre, Thomas, Cécile (Jean-Pierre’s children) and Charles, Mathieu and César (sons of François) also all work full-time at the estate. All seven of the children worked in wineries around the world before returning to the family estate.  A visionary estate The estate was one of the first in Southern Rhône to become organic (in 1950) and then biodynamic (in 1974), making the vineyard better prepared than most for the climate change effects over the last 30 years.  “Beaucastel is the largest Châteauneuf-du-Pape estate in one contiguous plot and it stands at the most northern limit of the appellation. It is a vineyard which is therefore very exposed to the Mistral winds, which has a huge cooling-down effect,” Emmanuel explains, protecting the vineyard from extreme temperatures.  The vineyard is based on a limestone bench covered by a rather atypical mix of clay and sand, topped with diluvium “galets roulés” (pudding stones). It is an incredible terroir that, Emmanuel explains, “allows us to combine power and finesse even in the driest vintages. It has always been considered a benchmark terroir in the area and was in fact a cru before the Châteauneuf appellation was created.”  
The biodynamically farmed old vines have also helped offset the ever-increasing drought pressures in the region. “We are extremely fortunate to have older vines,” Emmanuel says. “The galet roulés covering our vineyards also help prevent water evaporation. So all in all we’ve managed to make great wines even in warmest and driest vintages.” That hasn’t stopped the domaine, however, from continuing to adapt their methods to better cope with the ever-present threat of climate change. “We are learning more and more every year and continue to implement changes we deem necessary.” Alcohol levels in the region have undoubtedly risen, an effect that the estate looks to counter. 
When Jacques Perrin was in charge, he created a very specific vinification technique which he later patented. He would heat up the must to 80˚C, to start fermentation quickly while allowing Jacques to use less Sulphur, helping fix the colour of the wine, particularly with the Mourvèdre grape which has a tendency to lose colour with age. But this method also reduced the greener flavours in the wine, that came from less ripe grapes. 
Today’s climate, however, does not face the same issues, with consistently riper fruit. As a result François and César have phased out this technique, instead opting to whole-berry fermentation, and even whole-cluster ferments for varieties like Syrah, to naturally reduce alcohol levels. These days they also pick earlier, opting for more freshness whereas in the past it was always the goal to maximise ripeness, something that no longer is an issue for the region.  “The estate is always looking at ways to counter the issues of climate change,” Emmanuel continues. “For example, some of the younger Syrah vines are today producing very powerful wines so we are either co-ferment with some Grenache, reincorporating some of the stems in the vat or carry out whole-cluster fermenting,” helping to find better balance in
the wines. In the vineyard too, the team is constantly looking for ways to improve. “We recently tried spraying clay on leaves to limit photosynthesis,” Emmanuel says. The initial experiments have proved positive, but it is still too early to see the long-term effects on the wine
and requires further testing. 
But this experimental approach is everywhere in the property. They continuously make alternate blends that they age in the Beaucastel cellar and over time compare with their main cuvées to see how well the final blend develops versus a different potential version of
the same wine: Emmanuel states the cellars are full of these experiments. 
The domaine has also been assessing how the Beaucastel wines age with different fining techniques. “We do a lot of comparative tastings and assessing of older experimentations. For example, we recently did a horizontal of Château de Beaucastel 1996, where each bottle was fined differently, and identified which fining technique works best for ageing the wine – this is crucial in the development of our knowledge and helps us to make sure decisions taken in the moment are the best ones for the future.” 
Hommage à Jacques Perrin What is distinctive about Château de Beaucastel and the Hommage cuvée in particular is the high proportion of Mourvèdre in the blend. The Hommage is typically made up of 60% Mourvèdre. Emmanuel explains, “Hommage is from our Courrieux lieu-dit parcel, where Mourvèdre was first replanted (post-phylloxera) in 1910. As Mourvèdre is such a late-ripening
varietal, Château de Beaucastel needs an outstanding Indian summer to hope for an Hommage vintage. The decision thereafter is taken during the blending tastings. 
“When tasting the foudre of Courrieux back in 1989, François and Jean-Pierre were overwhelmed by the outstanding quality and knew that it had to be bottled on its own. Jacques Perrin’s intuition for the best blend from the estate revolved around a dominant proportion of Mourvèdre. As a tribute to their visionary father, they followed his instinct and
dedicated this unique cuvée to him.”  Production remains tiny despite the huge demand for the wine. In recent vintages, production has been around 6,000 bottles per year. The only difference in the vinification process of Hommage versus their other cuvées is an extra six months’ ageing in 4,000-litre foudres. All the winemaking is fairly hands-off, vinifying all the varieties separately apart from the Muscardin, Vaccarèse and Terret Noir which – due to the tiny quantities – are co-fermented. The reductive varieties – Syrah and Mourvèdre – are fermented in open-top wood fermenters and the remaining oxidative varieties are fermented in concrete tanks prior to the all-important blending sessions with the family.  The 2018 vintage has already been fantastically reviewed, awarded a potential perfect 100 points from the Wine Advocate, with reviewer Joe Czerwinski describing it as “full-bodied
but incredibly silky, combining great purity, richness and length into a seamless, elegant package that should give immense pleasure for decades to come.” The success of the 2018 vintage, according to Emmanuel, was “down to the perfect ripening conditions in mid-October, allowing them to bring the grapes of this late-ripening variety in at perfect maturity – 2018 was fantastic for Mourvèdre.” 
The grapes of the Southern Rhône 
Château de Beaucastel proudly uses all 13 permitted varieties of the Châteauneuf-du-Pape appellation. Some even say 18 varieties, since varieties like Grenache, Terret, Clairette and Piquepoul all have a black, pink and grey clone of the variety mixed within the vineyards. “Each variety brings its own attributes that differ depending on the vintage, but also depending on the amount you use or the blend you make,” says Emmanuel. “For example, when you open a young Beaucastel, it’s very Grenache-driven, even when there is a similar percentage of Mourvèdre. It’s only few years later that Mourvèdre will finally come to the
fore, revealing game, leather and savoury characteristics. “Individually, Mourvèdre brings power and structure, but when you open an older Beaucastel it delivers freshness and silkiness. Grenache Noir brings kirsch, plum and cassis fruitiness. Syrah adds color, tannin and spices, and when blended with Mourvèdre and Grenache it
brings truffle notes.  Counoise can be considered the Pinot Noir of Châteauneuf-du-Pape and has a distinctive white pepper note. Cinsault adds freshness, Muscardin and Vaccarèse are very floral and add freshness, Terret Noir is light even in colour and adds acidity. The white varieties of Roussanne and Grenache Blanc bring elegance and freshness. Clairette is very aromatic and brings unctuosity. Bourboulenc adds tension with notes of almond and vanilla, Piquepoul richness and Picardan adds a lot of bouquet.   “For us it is very important to have all the varieties to make an elegant and balanced wine. However, above all, it is the knowledge and the art of blending, passed on from generation to generation of the Perrin family, that is the key to understanding the real expression of Château de Beaucastel terroir.” With experimentation at the heart of the Perrin philosophy, the infinite potential of blends when using so many grapes in the wine keeps the extended Perrin family busy monitoring their blending decisions as the wines develop with age. With the 2018 Hommage, it looks like

It was a small yellow aphid that disregarded national borders, wiping out the livelihood of every grape grower in its way and there was no known cure nor effective prevention in its first devastating years. Even when a cure was discovered, growers were reluctant – and often financially unable – to use it.  As a result, phylloxera vastatrix  – vastratix meaning ravager – continued to nibble on the roots of vines across western Europe, sucking the lifeblood from the vines and leaving wounds for any passing infection. By 1900, 2.5 million hectares of France's vineyard had been uprooted, causing production to slump, encouraging dodgy dealers to make fake wine, and leading to mass protests.  The story of phylloxera in Europe started as a well-intentioned gift. In 1862, an American grape grower sent some cuttings of native vines to his friend in the Rhône Valley who planted them, unaware of the damage it would inflict on his compatriots. Within a year, local growers were lamenting their sick vines. Phylloxera had wanderlust, sparing no French region; nor did it respect the country's finest terroirs or illustrious châteaux.  However, a concerted national response to the potential ruin of the country's national beverage was not forthcoming. The French government was too busy putting on International Exhibitions in Paris (1867), opening the Suez Canal (1869) and waging war on Prussia (1870-71). In 1870, the government acknowledged there might be an issue, offering a 20,000 Franc reward for a cure. Remedies were offered including burying living toads in the vineyard, adding volcanic ash from Pompeii to the soil or inviting a marching band to play to the vines. Unsurprisingly, the vines continued to die. In 1880, a solution was finally accepted: graft European varieties to the roots of American vines. However, grafting noble French varieties - vitis vinifera - to the roots of these lowly American varieties seemed like sacrilege to many growers. It was thought they would affect the nobility of their precious wines. There was also the issue of cost: uprooting your vineyard, replanting and then having to wait between three and five years for a crop did not feed a family and the concept of state aid was still a long way off.  As a result, many tried to limp on for as long as possible, injecting carbon bisulphide, an expensive and toxic solvent used to vulcanise rubber, into the soil to stave off the inevitable.  The producers in the south of France were the first to be hit in the 1860s and they replanted with high-yielding hybrids. By the turn of the century, the Languedoc was producing more wine than ever before. However, the region's unscrupulous merchants made up for the initial shortfall at peak phylloxera by bulking out grape juice with sugar and water while others made wines from raisins. These practices continued despite the replanted vineyards returning to full production, causing a huge oversupply and depressing prices.  Urged on by a growing labour movement, hundreds of thousands of people took to the streets in 1907 to call for change. The Champagne Riots of 1911 The Champenois followed suit, rioting in the streets in 1911 and the root of their troubles also lay with phylloxera.  In 1892, the Marne was invaded by its first phylloxera aphid and, by 1910, 40% of the region had been affected. But this was no time for production to fall: Champagne sales were booming and to make up for the shortfall, dodgy merchants (and some of the seemingly reputable houses) brought in wines from the Loire and the south of France by the train-load. The wines were made sparkling in their cellars and the bottles emerged, as if by magic, as Champagne. Supply and demand economics suggested that the growers should have been earning more for their fruit as phylloxera affected supply and sales boomed, but fake Champagne kept prices low. Having borne the cost of replanting their vineyards, this was not how growers imagined they would be rewarded and protests ensued.  While most vineyards in Champagne and beyond are now planted on American rootstocks, there are some vines and vineyard owners that play wine roulette and grow vitis vinifera on their own roots. For example, three plots belonging to Bollinger were planted in 1960 in the traditional pre-phylloxera way. One has succumbed to the vine louse but the remaining two parcels are the source of Vieilles Vignes Françaises, a rare Pinot Noir-based Champagne that provides a taste of a bygone era.  We asked Denis Bunner, Bollinger’s Deputy Cellar Master, about the Aÿ-based Champagne House's rarest wine, Vieilles Vignes Françaises, which is produced on its own roots.  Why did Bollinger begin producing Vieilles Vignes Françaises in 1969?  An English journalist Cyril Ray proposed the initiative to Madame Bollinger following a visit in 1967 and this inspired Madame Bollinger to create a wine from the precious vines to commemorate her 70th birthday, which saw the first bottle produced in 1969. The wine was launched in 1974. Are the vines pre-phylloxera? If so, they must be more than a century old. No, the current plots in Aÿ were planted in the 1960s but it is impossible to give an age to the vines due to the perpetual renewal and the way the root system grow [the system is called provignage, which is like vine fostering when there is an empty space to fill. Take a cane from one vine, train it down into the soil and partially bury it with the end sticking out until it forms a separate vine. This is also done in the Nacional vineyard at Quinta do Noval]. There were three plots that weren't grafted but there are now only two. What happened? third plot succumb to phylloxera?  The third plot in Croix Rouge de Bouzy was attacked by phylloxera at the end of the 1990s – the vineyard didn't have protective walls around it. The last vintage was 2004 as we had to uproot it when it fell prey to the infestation. How many acres do the two remaining plots cover?  The Clos Saint-Jacques (Aÿ) covers just over half an acre while the Clos des Chaudes-Terres, which lies within the boundaries of Bollinger’s own lands, covers a little over a third of an acre. In total, they represent 0.36 hectares. Is there anything special about the soil of these two plots that means it resists phylloxera?  The soil is not remarkably different from that in the rest of Aÿ and as per the rest of Champagne it features chalk. Is this special cuvee made every year?  No. Only in declared vintages. What is the average production of Vieilles Vignes Françaises?  This varies by vintage, but falls within the range of 2,000 to 3,000 bottles. Phylloxera: a vine pandemic

There’s something unlikely about the pairing of Scotland and Andalusia – the fine single malts of Scotland’s craggy landscape being matured in barrels shipped from the warmth of Jerez, where orange trees line the streets. Together, however, the raw spirit and these barrels – drenched in the complex flavours of the Sherry they previously held – create something all the more special.  Today you’ll find spirits aged or finished in any number of casks – previously bearers of Bourbon, wine, Port, Madeira and more. Sherry casks are, however, the traditional choice – but why?  Well, largely thanks to the Scots’ penchant for Sherry. The fortified wines of this southern Spanish region have been savoured north of the border since the 16th century, although it was a trend for Sherry and rum punches in its clubs during the 18th century that really caused a rocket in sales. Doubtless this was tied to Scottish interests in Sherry, with bodegas in the hands of the likes of Arthur Gordon and George Sandeman (also of Port fame) .  At the time Sherry was – like most wines – shipped in cask, then bottled on arrival. These barrels wouldn’t be the ones in which the Sherry had been maturing (ie they weren’t part of the solera), but barrels explicitly made and used for transport, holding Sherry for a matter of months as it was shipped from Spain to its final destination. This kept the Scotch whisky industry well stocked with a steady supply of Sherry casks being delivered right to its doorstep.  And producers found that these barrels – thought to have absorbed as much as 10 litres of Sherry – delivered layers of complexity to the spirit that fills them, adding notes of dried fruit, nuts and sweet spice. Of course the sort of Sherry that filled the barrel impacts the style of the final whisky. Biologically aged styles – Fino and Manzanilla – are rarely used, while the nutty, spice and dried fruit notes of Oloroso are the most common choice. Pedro Ximénez or PX – the lusciously sweet, almost treacle-like style of Sherry – lends the richest notes to a whisky.  Gradually, however, regional bodies around the world started insisting wines were bottled at source to protect their wines from possible adulteration. And so in the 1980s, the death knell almost sounded for Sherry-cask-aged whisky, as it became illegal to transport Sherry in cask. This, paired with Sherry’s fall from fashion and therefore decreased production, made Sherry casks rare beasts.   But – to the relief of whisky-lovers everywhere – the industry found a solution. Today, the production of Sherry casks for the whisky industry has become a second avenue of income for Sherry bodegas. The barrels are filled with Sherry with the sole purpose of flavouring the cask – either at the bodega in Jerez, or in Scotland (having shipped the Sherry over).   Technically, there’s no definition of “Sherry cask” under Scotch whisky regulations. While casks have to be made of oak and hold no more than 700 litres, the rules don’t specify how long a cask would have to hold Sherry for the term to be used on the label. In fact, at present, the casks don’t in fact have to hold “real” Sherry – and as a result much of the fortified wine used to season casks is from beyond the borders of the Sherry triangle.  “True” Sherry casks are in high demand. Today they can fetch as much as 10 times the price of a Bourbon cask. Given their expense and rarity, it’s no surprise that producers use these casks many times over. However, with each use the impact of the Sherry flavour is reduced – meaning that “first-fill” casks are all the more special. Few people have been lucky enough to be as immersed in Burgundy’s finest wines as Martin Donatsch. His father bought a pallet of top Burgundy, including those of Domaine de la Romanée Conti (DRC) and Armand Rousseau, every year from the early 1970s onwards. Martin’s birth in 1978 – a fantastic vintage in Burgundy – only encouraged his father to buy more, and Martin, now in his early 40s, has been enjoying wines from the family collection ever since. Just last week, he uncorked a 1978 DRC Echézeaux. This immersion has provided him with an extraordinary understanding of Chardonnay and Pinot Noir – something that has doubtless helped him become one of the world’s great emerging winemaking talents. Donatsch is one of a small number of producers growing Pinot Noir, Chardonnay and the native Completer grape in Bündner Herrschaft in Switzerland. This tiny Swiss valley, for the time being, remains largely unknown – but, as Donatsch certainly believes, it may just be one of the world’s last great regions for fine wine production.The altitude (500 to 700 metres above sea-level) sees the vines flower a week later than is typical in Burgundy, yet picking dates are three to four weeks later. This provides a much longer growing season, allowing for complex flavours and aromas to develop in the grapes. Despite the altitude, the grapes reach good levels of ripeness thanks to the warm, dry wind – known locally as a “foehn”, that sweeps through the valley. Unlike Burgundy, autumns here are dry, so there is rarely pressure to pick before rain arrives, allowing for additional hang-time. The altitude keeps the acidity high, offsetting the naturally slightly higher alcohol (typically around 14%), meaning the wines never feel overly alcoholic. While Bündner Herrschaft has been home to Pinot Noir since the 15th century, Donatsch – now in the hands of the fifth generation – has pioneered the quality revolution in the region. Martin’s father Thomas Donatsch was not only the first to – then illegally – plant Chardonnay in 1975, but also the first to introduce French barriques to Switzerland, influenced by his vigneron friend André Noblet, the winemaker at Domaine de la Romanée-Conti from 1945 to 1986. In the early 1970s, Thomas – a young 20-year-old about to take on the family winery – set off to learn from the best. Obsessed with Burgundy from a young age, he knocked on the door unannounced at Domaine de la Romanée-Conti. In a fortuitous set of circumstances, Noblet had just returned from his first ever holiday (in Gran Canaria) and the first extended time away from his beloved wines. He had missed his wine cellar so much during the trip, he couldn’t wait to return. Finding the young Donatsch sitting by the door and desperate to reacquaint himself with his wines, Noblet invited Thomas to spend the afternoon with him tasting the different cuvées from barrel. Martin believes his dad gained Noblet’s trust by initially criticising DRC’s Montrachet 1968. Tasting the wine Donatsch reportedly said, “There is no way this wine could come from the great Montrachet!” A little precocious, perhaps: fortunately Noblet agreed it wasn’t his finest vintage, but the result of experiments in the winery. It was the beginning of a lifelong friendship, with Donatsch returning to the DRC cellars every year. On each visit, Noblet would always pour him a glass of Montrachet 1968 and ask his opinion before tasting any of the other wines. It wasn’t long before Donatsch was buying a pallet of Grand Cru Burgundy every year (at that time a bottle of La Tâche was just over £35 a bottle). Noblet also started to help Donatsch improve his Pinot Noir – first by giving Thomas his first three French barriques. These weren’t just any old barrels though, they had previously held La Tâche and were made by François Frères – who at the time had just two customers, Domaine de la Romanée-Conti and Henri Boillot. Donatsch took the barrels back to Switzerland, and the winery has been using François Frères barriques ever since. I asked Martin why the introduction of French barriques in Switzerland was such a revolution for the region. At the time, he says, the Swiss wine schools were obsessed with cleanliness – teaching the importance of filtering wines, using protective winemaking methods and using stainless steel tanks even for the red wines. The use of barrels was the opposite; it meant no additional filtering and a more oxidative environment. Donatsch believes the introduction of barriques around the world revolutionised fine wine. Angelo Gaja was the first to do it in Italy; Torres the first in Spain; Mondavi in the US; and Keller in Germany. But Thomas Donatsch was doing this 10 years before any of them, thanks to the influence of André Noblet, as well as Jean-Bernard Delmas – the winemaker at Château Haut-Brion, another of Thomas Donatsch’s influential friends.  Speaking with Martin Donatsch, you can’t help but feel he has got all his priorities in order. The small size of his winery means he can control every aspect of production, while benefitting from the variety that a life in wine can offer. Producing just 35,000 bottles a year means that when he is not in the vineyard tending his crop, he is in the winery, or fulfilling orders and redesigning his website (graphic design is another passion of his). Being one of the country’s most prestigious winemakers he sells his wine into the country’s top restaurants and luxury hotels, who can’t get enough of his wine. Donatsch’s annual release of wines sells out in just hours. While this is a great sign of his talents, it is also why many people outside of Switzerland have never heard of, let alone experienced, the world-class Pinot Noir and Chardonnay from the winery. Despite the demand for the Donatsch wines, there are no plans to expand: firstly because the authorities won’t allow it, but second because Martin loves the “human” size of the business and doesn’t want to lose that. Martin is, however, keen for more people outside of Switzerland to taste them. Beyond the tiny volumes that make it as far as export, to source these extraordinary wines you’ll have to (when one can) visit the winery yourself.
