Colin Scott should be one year into his retirement. After 47 years at Chivas Brothers, 31 of which were spent as the Master Blender, he should be enjoying a well-earned rest. Instead, the ebullient Scott is lighting up the screens of the FINE+RARE team as he talks about a certain 50-year-old blended whisky he has created for remarkable spirits curators The Last Drop Distillers.   “It’s just fantastic to come to The Last Drop and find these nuggets of gold and all these wonderful casks of very precious liquid that have phenomenal complexity and flavour,” Scott says with unabashed glee.   Despite his near-50 years in the whisky industry, this is only the second 50-year-old blend Scott has had a hand in producing. Well-aged whisky was, until relatively recently, only a small part of Chivas’ business.   “By the time we’d filled a cask and it had matured to 12 years, most of that went into Chivas 12. Once it reached 21 years old, we put it all into Royal Salute. So, there was very little maturing. But of course, as time goes on, the stocks have been held back and the super-premium part of the inventory has grown.”   Scott joined Chivas Brothers in 1973 and became their fifth Master Blender in 1989. But he would have to wait a further 13 years before a 50-year-old whisky project presented itself. The result was The Royal Salute 50 Year Old, released in 2002 – a dual commemorative bottling for Queen Elizabeth II’s coronation and Royal Salute’s 50th anniversary.   Today he’s talking about his latest 50-year-old creation, The Last Drop’s 22nd release and first in-house whisky: a 50-year-old blended Scotch. After a whole three months as a man of leisure, the “retiree” joined the Sazerac-owned company as their first Master Blender in autumn 2020.   “When I joined in September last year, it was really the beginning of finding out what all these nuggets were within the inventory. Sorting through the very special and remarkable casks and finding out a little bit about what they were and what they did and how we could bring them together.”  Scott explains that everything in the blend started out as either a single malt or a single grain whisky, distilled at different distilleries around Scotland over 50 years ago. “At various stages along the way, blends have been made but then of course the balance has been put into cask and stored away for further maturation. So, what we have is a mixture of some of these malts and grains, all with their own unique characters and flavours, that we bring together at the last moment.”   Tasting the blended whisky alongside Scott is like being escorted on a journey back through time – to an age when a lot of distilleries were doing their own maltings and adding peat to the kiln to get a little smoky flavour.   “To me, blending is all about taking the flavours and then balancing them,” he says. “What you have here on the nose is a tsunami of flavour. But, when you taste it, nothing actually lingers and stays on top.”   Scott encourages tasters to add water to remove the aggression of the alcohol and maximise the release of the aromas and characters. When he is tasting more than 50 samples around a nosing table, this trick is vital to reduce all the whiskies to 20% alcohol and allow the flavours to present themselves.   In the case of The Last Drop 50 Year Old, its mellowness, richness and depth means you don’t necessarily need to cut the 48% dram.    “When we blend, we don’t add something, sniff it and then add a bit more of that. What we do is actually write down the whole formula in its entirety. We then pilot blend it. When we add the last addition, it will change the balance of everything you have already. So, you don’t know the final answer until you add that last part of the formula. And then once you’ve got them all together you can evaluate what you have actually created.”  For Scott, the act of blending and evaluating is an entirely personal thing. “All whisky – grains, blends – are fantastic. They are all different and they all bring their own song to the party. The only reason one is better than other is your own personal experience.”   Scott, for instance, isn’t “a fan” of the smoky Islays. “I don’t think they’re bad,” he adds. “It’s all about personal taste. There’s not a bad whisky in the world.”  The Master Blender talks at length about whiskies having different personality traits that require nurturing and, ultimately, respect.   “If you take a single malt as distillate at birth – that has a flavour package. It’s like you when you’re born – you have a character. If you put that new distillate into a cask, over the years this distillate will react with the oak in the cask and take influences and nuances which will then promote other flavours in the new spirit.  “So as time goes on, the volume actually goes down, the strength goes down, but that flavour package actually intensifies and intensifies and multiplies and multiplies.”   When it comes to age, there is some debate about how old you can go. For Scott, the 50-year-old is undoubtedly a rare beast, but he doesn’t see any reason why you can’t go older and rarer if the whisky has been sufficiently nurtured.   “If the angels didn’t interfere, in a quality cask, you could take it to 60-, 70-, 80 years,” he says. “If you’ve got quality casks, you don’t get that wood influence. You get a little touch of the oak but what you have at the end of the day is this small amount of highly intense, complex flavoured whisky that started as the new distillate and just grew with all the different influences from the oak and the cask whether it is Sherry or Bourbon.”  While there have been scientific advancements during Scott’s career, he says there are still a great many unknowns about the maturation and flavour process, and you get the impression this only adds to the allure for him.   “Because it’s nature, we don’t actually know what’s going on,” he adds. “It’s massively complex and the technical people still don’t know the number of components in Scotch whisky. I think they’re up to about 800 now. Just over 25 years ago, French fashion house CHANEL entered into the world of fine wine, purchasing the largely underperforming Margaux Second Growth estate Château Rauzan-Ségla. Two years later they acquired the Saint-Emilion Premier Grand Cru Classé, Château Canon. They have since turned these properties into two of the most in-demand fine wines in Bordeaux today. In 2019 CHANEL embraced their latest endeavour, acquiring Domaine de l’Ile, a prestigious wine estate on the French riviera on the exclusive island of Porquerolles, the largest of the “golden” islands just off the Côte d'Azur. Sharing the same philosophy as their sister wineries, they have invested in a stellar winemaking team at the Domaine, enlisting the help of Pierre Etcheberry and celebrated winemaker Nicolas Audebert (of Châteaux Rauzan-Ségla and Canon). Nicolas Audebert is in fact a local to the region, born and raised in the nearby port city and naval base of Toulon. We caught up with him to discuss returning to his roots in Provence and to find out what makes this idyllic island so well-suited to fine wine production. “I was born in Toulon. My father was a naval officer, so we used to travel a lot, living in different countries, but we would always return to Provence. Porquerolles is a very special place to me as we would spend time sailing there with friends and family.  Probably my strongest memory of when we were kids is sailing with my family and spending nights “au mouillage” on the Notre Dame beach. My brother and I would wake up early in the morning with a mission:  buying some bread in the village. We would spend the whole morning walking on the back trails, discovering the island and its incredible nature, guided by the eucalyptus perfume to finally reach the Place d’Armes, where the bakery is. By the time we were back on the boat, it was lunchtime.  As a child, Porquerolles was the epitome of nature and freedom.   My travels and the great outdoors are part of my DNA, that’s why I decided to study Agronomy and then Oenology in Montpellier. Winemaking took me to Champagne, South America, Bordeaux... Today, coming back to Porquerolles is like coming back to my roots - and making wine there is the icing on the cake.”  The history of Domaine de l’Ile The island of Porquerolles is a place of idyllic beauty with a fascinating history. First inhabited in 1820, the island was largely destroyed by a devastating fire at the end of the 19th Century, before being auctioned off in 1910. The island was acquired in its entirety by François Joseph Fournier, who as Nicolas explains, “was a man of many lives”; the son of a poor Belgian boatman, he became fabulously rich thanks to his discovery of the largest seam of gold ever found in Mexico. Fournier was the sole bidder in the auction of the island, which was a wedding gift to his wife, Sylvia. They actually established vines on the island almost immediately, planting vineyards on different strategic plains of Porquerolles. Under their visionary and watchful eye, the island reclaimed its agricultural character. It sprung back to life; an oasis in the middle of the Mediterranean. The vines populated its gentle slopes and fuelled the chatter in the village. The vineyards were in fact some of the first in the region to be classified as Côtes de Provence, due to the quality of the wine produced. In 1957, the island was divided up between the four Fournier daughters; each one received a plain. Progressively, three of them sold their inheritance to the French government, but Lélia Le Ber (neé Fournier), fought to keep her land and replanted vines on the Brégançonnet plain.  She passed on the estate to her son, Sébastien Le Ber, who managed the family business before entrusting the site to CHANEL, opening a new chapter in the story of Domaine de l’Ile.  From the Classed Growths of Margaux and Saint-Emilion to Provence Asked why CHANEL decided to invest in a new winery, and in particular in Domaine de l’Ile, Nicolas explains that it was "love at first sight" with this island vineyard in the heart of Provence, its special terroir, the Le Ber’s philosophy of Porquerolles and their unique history. “As we took over Domaine de l’Ile in early 2019, Pierre Etcheberry joined the estate’s team as Vineyard Manager. Pierre has an Agricultural Engineering degree and spent three years at Château La Fleur in Bordeaux as Assistant Technical Director.  At Domaine de l’Ile he is now in charge of the winemaking, vine growing and day-to-day management. Pierre stays in touch closely with the teams in Bordeaux, and they visit regularly whenever their support is needed.”   In the vineyard The individual parcels of Domaine de l’Ile were delimited and planted in 1957. While Porquerolles shares similarities with Provençal rosé in terms of the soils and climate, it remains unique because of the insularity specificities, explains Nicolas. “Being an island, Porquerolles has a unique ecosystem: vines grow on orogenic schist bedrock and clay soils, vines are surrounded by wild and protected fragrant flora, under a warm Mediterranean climate and are exposed to fresh saline winds.  The unique environment of the vineyard has a real influence on Porquerolles wines. Surrounded by the sea, growing on an exceptional soil under seasonal high temperatures and exposed to salty winds, the Porquerolles vines produce wines of character with a fresh tension and saline notes. Pine trees, eucalyptus and wild flowers frame our parcels, this very rich naturally odorous environment finds its illustration in our wines, in delicate flavours.” “The blend of grapes in the Domaine de l’Ile rosé is made up of Grenache, Mouvèdre, Cinsault, Syrah and Tibouren.” For Nicolas, these traditional Mediterranean grape varieties express all the uniqueness and insularity of the Domaine de l’Ile wines. “On dry and stony soils, enduring the wind, gorged with sun, the Grenache brings generosity to the blend, a reminder of the sweetness of local life. The Mourvèdre likes to watch the sea. It affirms all its character here and adds its grains of spice. A window opens on the pine forest. The white flesh fruits of Cinsault combine with the freshness and crispness of Syrah. As for the Tibouren, authentic Provençal, it is at home here, deploying its nobility on these shale soils.”  Life on Porquerolles The idyllic picture postcards of the island don’t lie; Porquerolles is exceptionally beautiful. Such landscapes are due to its protection, conservation and very real isolation. During summer, thousands of visitors discover the good life of Porquerolles, exploring the local restaurants, community and the beautiful coastline by walking, biking or sailing. But once the high tourist season ends, nature takes back its rights. Spring is sweet but autumn and winter can be difficult. To live on Porquerolles is a real philosophy of life, a desire of being out of “the continent”, a place where time flows slowly.  Finally, we asked Nicolas’ thoughts on rosé wine more generally and where and when best to enjoy it. “Rosé is the traditional wine of Provence, a region that has nothing left to prove. It designates wines of incredible diversity that can be found on the most prestigious restaurant wine lists all around the world.  From the ones to be enjoyed between friends over a simple supper, to some brilliant and complex expressions of terroir paired with more elaborate menus. For me, when spring begins to bloom, and temperatures rise, opening a bottle of a rosé wine offers you a promise, a foretaste of the coming summer. And in autumn, or even in winter, it will put a smile on your face, as an opportunity to remember the joy and pleasure of the long-gone summertime. Last year, the great and the good gathered at the ancestral home of the legendary Gordon family (of William Grant & Sons). A hearty dram was poured for the world’s foremost drinks authorities and they were asked to name the liquid within. So far, so normal in the Scotch whisky world. What happened next is quite unusual. Not one of the experts – with decades of experience and dozens of book credits to their name – could so much as hazard a guess.   The answer to the seemingly simple but dastardly question dumfounded them all. The as-yet-unidentified liquid was a single grain Scotch whisky that had slumbered in a lone Sherry butt for 53 years. Now almost jet-black in colour, the single grain had taken on incredible, rich notes of dried fruits, roasted coffee, and muscovado toffee – and it was indistinguishable from a greatly aged single malt.   The Cask Trials, which is the name given to this highly unusual liquid that left some of the finest palates awestruck and not-so-secretly hoping for a bottle in their gift bag, is just one of the panoply of independently bottled House of Hazelwood releases from the Gordon family’s private Scotch whisky archives.   Somewhat surprisingly, you won’t find a single malt among them. These rare whiskies, which have been amassed over the past 100 years by the owners of Glenfiddich and The Balvenie, were released to the public for the first time in 2022 in two, painfully scarce, collections. The Charles Gordon Collection (all priced above £3,000 per bottle and aged for at least 40 years), and the Legacy Collection (priced between £950 and £2,000 a bottle) are all well-aged blended Scotch, blended grain and blended malt whiskies that have been matured in the most novel ways.   “Bringing old, expensive and unusual blended whiskies to the market is slightly counterintuitive,” House of Hazelwood Director Jonathan Gibson – who was instrumental in creating the range – candidly tells me. “It's not overly common within the industry.”  It’s also not overly common within the industry to bottle liquids of this age and provenance with playful names such as "Blended at Birth", "Sunshine on Speyside" and "The Old Confectioner’s", in understated packaging at these price points.  The liquids are undeniably scarce (once they’re gone, there really is no more) and old (few are under 40 years of age, and the oldest tops 50 years), but they are undeniably unusual and at odds with the highly successful formulaic approach others have followed of encasing precious liquids in highly ornate, priceless vessels that weigh more than a small child.    “They're not concept releases,” Gibson explains. “Everything is driven by the whisky. The packaging is quite straightforward. It's a nice bottle and it's classically engraved but we haven’t collaborated with the hottest designer. The idea is really just to give the whisky room, provide a platform, without overshadowing it,” he adds.   “Over the past 10-15 years – and it's no bad thing at all – you can see a lot more old age-statement single malts coming onto the market,” Gibson says, “And typically they're very straightforward in terms of their naming. It's distillery name, plus age statement equals a certain financial value.  “The naming of these releases is slightly playful, but actually if you look at them one by one, they're very straightforward. It's not quite a Ronseal, ‘it does exactly what it says on the tin’ approach, but it's not too far away from that. If you said ‘Blended at Birth’, it could be seen as quite playful but it's also quite descriptive and the same for ‘The First Drop’ and ‘Sunshine on Speyside’,” he explains.   It's clear Gibson, who has been involved in the project since the start, has genuine affection for the whiskies and the stories each one has to tell. He and the team are custodians of historical artefacts that the Gordon family have not parted with for the best part of a century.  “The First Drop”, for example, is named as such because it is the first liquid to run from the stills at the Gordon family’s Girvan grain distillery on Christmas day in 1964. This is the first and last time it can be purchased. “There's a real emotional tie from the family to these whiskies,” Gibson explains. “For the current family members, it's their dad who laid down these whiskies and he's not around anymore.  “I think it's actually quite difficult for the family to let some of these whiskies go, even though there's a begrudging acceptance that they can't drink such quantities and it was time they cut the cord and let these whiskies go out into the world.”  “There's a general principle that we're following where the whisky is ready to go when it's ready,” Gibson explains, “so we're not chasing down a 60-year-old age statement just so that we can put a big 60 on the bottle.”   It has been a pleasant surprise for all those involved to witness the reception the House of Hazelwood whiskies have received from an occasionally prickly and vocal audience.    “Sunshine on Speyside had an amazing response and it's one of the least expensive whiskies within our range,” Gibson says delightedly.   “It was selected because of its character and its flavour, and named because it has this amazing mango/ pineapple popsicle fruit character that transports you to sunshine and the Caribbean. It's one of those ones where everyone instantly agreed that it had to go into the first collection.   “I thought that everyone would be drawn to the oldest whisky at tastings but actually, this whisky captured the imagination of a lot of the writers and the trade.”   It’s hard to emphasise quite how unusual these whiskies are, as most releases – old or new – are described in hyperbolic terms.   “Blended at Birth”, which was released as part of the first collection, is a blend of malt and grain whisky that was married and matured as new-make spirit. Today, it is against the Scotch Whisky Regulations’ technical file to produce a whisky in this way, as you now have to age the malt and grain whisky components for a minimum of three years separately before blending them, so any liquids of this ilk on the market are painfully scarce.   “Unusual” and “esoteric” aren’t always necessarily loaded with positive connotations – you might take a sip of said liquid, politely smile and then return to something slightly less unusual and more palatable – but these whiskies have incredible balance and depth of flavour, in part because they are blends and not single malt whiskies.    “These old grains in particular are just unbelievable in terms of the flavour,” Gibson says with unfettered joy. “At a younger age, grain whisky is quite neutral in character but once you're past 30 years, if it's aged well, grain whisky has a luscious, delicious quality which adds so much to the final profile of the Scotch.    “The variation in style is enormous,” he continues. “I thought I understood old grain whisky but on exploring the inventory further you see these amazing grains that you didn't really know you could get.”   These whiskies wouldn’t have existed if it wasn’t for the foresight of the Gordon family  – and two brothers, in particular, who changed the company’s stars during the mid-20th century. The young Charles and Sandy Gordon brought much-needed vim and vigour to what could be a bit of a staid industry in the late 1950s. The pair famously refused to kowtow to demands from their grain whisky supplier – instead pulling the contract and setting up their own grain distillery, Girvan, in the 1960s. Charles – or Charlie as he was known – even forwent the comfort of his own home and instead lived in a caravan on-site during the build, riding a bicycle to stealthily check on the workers’ progress. His unconventional methods clearly paid off as the sizeable distillery (which still stands today) was built in a record nine-month period.  During their tenure, the duo also interrogated every aspect of whisky-making from distillation to maturation, resulting in the bold decision to employ an on-site coppersmith and cooper – which are still in situ at many of the William Grant distilleries today – to give the family more control. They were a formidable pair and the business arguably wouldn’t have survived some of the challenging periods in Scotch whisky’s history had it not been for their fortitude.     “There's something about family ownership that means you have a bit more luxury to maybe indulge some of your creative whims,” Gibson says with a wry smile. “This independence enabled them to explore ideas that might have been hard for others to justify to their board of shareholders.”  When other producers would have been forced to make very difficult decisions in order to survive those darker years, the larger, independent William Grant would have been slightly more insulated. Out of curiosity alone, they would have been able to hold on to barrels of maturing liquid and see how they developed over time.  These are the barrels that the House of Hazelwood team – and by extension us – now have access to. Each one has an incredible story – and an even better depth of flavour. Driving through Napa and Sonoma, the land still bears the scars of 2020. The wildfires that raged through the region have left a long-lasting mark, whether it’s lengthy reconstruction efforts or the stark, charred tree trunks that cover the mountains. But it’s more than that. To an outsider, the fires feel intangible, terrifying yet somehow conceptual. Talking to those that lived through them, however, makes you instantly realise quite how petrifying that season was. The trauma of those flames is still smouldering away.  In 2017, fires hit Northern California on 8th October, however most producers had already harvested. Indeed, the fire even crossed the Kistler property, but their vines helped act as a firebreak. Two years later the Kincade fire swept through Sonoma County at the end of October. But in 2020, the first fires arrived earlier. The LNU Lightning Complex started with what is known as the Hennessey fire on 17th August. Sparked by lightning after thunderstorms, the complex was a weave of 250 different fires that collectively raged through almost 150,000 hectares of the region. The damage was enormous: 1,491 buildings were destroyed and six people lost their lives. While the fire did diminish in size, it wasn’t entirely extinguished until 2nd October, almost a month and a half after it started.  Before the Lightning Complex had fully subsided, the Glass Fire attacked. The blaze started on 27th September, east of St Helena near the Silverado Trail, spreading north to Calistoga and then south and west, towards Santa Rosa. It burned until 20th October, encompassing over 27,000 hectares and taking over 1,500 buildings with it, including numerous wineries. It cut through Eisele Vineyard, across 90 acres of hillside and forcing them to rip up 1,000 vines. Fortunately they’d already picked all their fruit (finishing their harvest three days before the fire broke out, on 24th September). And this was all in the midst of Covid-19.  Wildfires aren’t new in Northern California, but they’re certainly more prevalent than ever before. Indeed, as Cory Empting – Director of Winegrowing at Promontory, Harlan and Bond – tells me, the region’s indigenous people, the Wappo, used to describe autumn as “smoky mountains”.  Paul Hobbs – who has been making wine in “the Valley” (as the locals would say) since the late 1970s – remembers a fire in the 1980s that burned its way along the Silverado Trail. “All it took was a gust of wind,” he says – and one flame turned into something uncontrollable in the blink of an eye. He remembers climbing up on a roof to see the sobering effects of the fire.  Perhaps partly due to this early exposure, fires have always been at the forefront of his mind when picking a site – avoiding rugged, dry areas like Diamond Mountain or Calistoga. And he is exacting with forest management of the sites he works – even on our wander around his Goldrock Estate vineyard, he notices some saplings that are troubling him, and calls over his vineyard manager to take a look, conscious to reduce the risk as much as possible. And he’s deservedly cautious. The 2017 vintage was his first working with Cleary Estate out in Freestone-Occidental, and he paid almost $2 million for fruit that he couldn’t use. The fire itself is one challenge, however vines are natural firebreaks so don’t tend to suffer much direct damage (although the heat from a blaze can sometimes scorch vines). The real threat, however, is in the air – smoke. But the science of smoke taint is complex, and poorly understood. Producers can send samples to laboratories to be tested for the compounds responsible for the taint (guaiacol and 4-methylguaiacol) but the exact level of perception isn’t known. These compounds also naturally occur in some varieties, eg Syrah, and come from oak barrels (in particular the toasting process).  Of course the impact of smoke is dependent on proximity to the fire, the intensity of the smoke, elevation and the wind. Hobbs explained how in 2020 much of the smoke from the Glass Fire stayed north for several days, but then the wind shifted and sent it south to the Bay Area. As smoke travels, and ages, the volatile compounds also degrade, so there is also a significant difference between the impact of “fresh” smoke, versus what Hobbs describes as “atmospheric” smoke. The latter may look bad, but it’s unlikely to hold significant taint, whereas if you’ve got fresh smoke, it’s “game over”.   Lots of producers do micro-ferments to look for smoke taint, testing to see if it’s worth the expense of picking the fruit and making the wine – however that’s also not a sure-fire way to know if you have smoke taint. The nature of these compounds means that they can lurk, undetectable in a wine, and emerge in bottle as hydrolysis occurs. “That’s why it’s so insidious,” Hobbs says.  If you’ve got smoke-tainted fruit, the options are limited. The compounds are concentrated in the skins, so the aim is generally to minimise skin contact. Indeed, some producers made rosé in 2020, having picked earlier, with higher acidity than normal. Otherwise you can use reverse osmosis or spinning cone (both expensive processes that are used for de-alcoholisation), or carbon fining – or a combination of all of the above – to try and strip out the smoky flavour. The result, as Mark De Vere MW at Robert Mondavi said of trials they’d done, it generally didn’t work, but if it did, “It took so much else out.” (Robert Mondavi ended up making almost no 2020 wine.)  *  Read anything about 2020 and there is a cacophony of opinion. “Everyone handled the vintage differently,” Cate Kistler of Occidental told me. They picked on 18th August, not in response to the fire, but because that was when the first fruit was ripe. They didn’t do any micro-ferments or send samples to labs (“We’re not data-crunching people,” Kistler says). The cost of picking was, for them, “a drop in the bucket” in comparison to farming the vineyards the rest of the year, so they tried to do what they could.  “It was going to be either Occidental, or nothing,” she said with a shrug. They took their time, committing to making every decision as if it was a normal year, finishing on 6th September just as the Labor Day heatwave hit. They didn’t use everything they picked, but they made all five of their single-vineyard wines – and the 2020s we tasted are glorious.   Some, like Colgin, didn’t make any wine at all, while many producers made around 40% less (such as Williams Selyem and Peter Michael). Many of the 2020s that will be released were picked before the fires struck. Cathy Corison had all her fruit safely in the winery more than two weeks before the Glass Fire hit, but the challenge was to keep the smoke out of the winery. She bought industrial grade air filters to shield her ferments. “They’re beautiful,” she says with a quietly proud smile.  At Dalla Valle, Maya Dalla Valle doesn’t pretend that it was an easy year, but she’s pleased with the wines they made (all with fruit picked before the Glass Fire). As ever, these are wines that speak of their year – which wasn’t just the fires, but a hot, dry year that (along with a block that was being re-grafted) cut their crop to a mere 2,700 cases in total. At Dominus, they did micro-ferments after the Lightning complex, and had picked their last row of fruit on the morning the Glass Fire broke out.  Steve Matthiasson – the leading viticulturalist who also has his eponymous label with his wife Jill – told me how it was set to be “an epic season” before the fires hit. He highlighted how the smoke meant there was less UV light reaching the grapes, and that meant the fruit wasn’t as phenolically ripe. They pick early, so had started harvest 10 days before the Glass Fire broke out. The Cabernet Sauvignon in their Phoenix vineyard was still out, but they managed to pick it the morning after the fire broke out, before the smoke was able to take effect.  Most who picked early are in agreement that the hot, dry conditions were in their favour. Promontory saw only eight inches of rain, versus the 30 of a normal year. But that hydric stress helped them – it meant the crop was small and the vines shifted to ripening the fruit earlier, so even though they picked on 22nd August they had no pyrazines. As Will Harlan says, in some ways, “The stars aligned”.  The 2017 vintage might have prompted people to start thinking about climate change, but 2020 was a real wake-up call for the region. It prompted Martin Reyes MW to try and create a community around climate action. Eventually, working alongside Anna Brittain, he founded Napa RISE (standing for Resilience Innovation Sustainability Empowerment), a climate and wine symposium that first took place in 2022 (with the 2023 symposium currently underway). It’s early days, but they’re “trying to build into the DNA [of Napa RISE] this notion of action”. He’s keen to avoid a conference focused on discussing concepts, but an industry convention that drives change.  One part of that conversation is inevitably fire – and a session last week focused on forestry management. “The relationship with fire we have is complicated – but it can be a healthy relationship,” Reyes tells me.   Controlled burning has long been a part of life for indigenous peoples – both in North America and Australia, where wildfires have now become a threat. In the US, controlled burning was officially banned in 1911 when the Weeks Act was introduced, but California is gradually realising the need for its reintroduction.  “Agroforestry was happening before conservation took it off the table,” Empting (of Domain W. Harlan) tells me. He talks about how when the previously evicted Miwok people were allowed to return to Yosemite, they were horrified by what they saw – where “conservation” had destroyed the ecosystems. For native peoples, seasonal work like controlled burns was a way of life – seen as their responsibility to the land. But it was a responsibility that colonialism robbed from them, and didn’t take on.  At the Pepperwood Preserve, native peoples do controlled burns. Empting visited to explore the practice and see if it’s something they could take up as part of their stewardship of the land. The challenge today is the paperwork – and politics. Permits are difficult to obtain, the fire department is reluctant and has to be involved, and then there are the neighbours to contend with.  Hobbs highlights that it’s not just that there aren’t enough controlled burns, but that manmade structures have taken over swathes of land – and they burn hotter, leading fires to rage in less predictable ways.  Of course, as with 2017, the 2020s are already being marred by rumour and reputation of a smoke-tainted year. The reality is so much more complex – and, although I haven’t tasted enough to make pronouncements on the vintage, there are some brilliant wines. Of course you’ll need to choose carefully, but for top producers there is nothing to be gained by releasing wine that is anything less than flawless.  While the fires have left scars, the land’s capacity for renewal is remarkable – with vibrant vegetation flourishing in amongst the scorched trees. The 2020 vintage wasn’t the first to see such challenges and it won’t be the last. The way the wind blows

Truffles: small, gnarly things. Equally ugly and alluring. Pungently intoxicating. Deliciously rare – and undeniably expensive. Alexandre Dumas described truffle as “the holy of holies”. Rossini called it “the Mozart of mushrooms”. Jean Anthelme Brillat-Savarin said just the name “awakens erotic and gastronomic ideas”. There’s something magical about the way these funghi lie just out of sight. The elusive treasures lurk beneath an otherwise unassuming forest floor, found only with the help of a specially trained hound. Once unearthed, however, they become the centrepiece to the world’s most expensive dishes, prized by Michelin-starred chefs and gourmands alike. They aren’t just another ingredient, however, there’s theatre to their presentation: the stage set in the kitchen, then served with a flourish tableside. For Rowan Jacobsen, author of the recently published Truffle Hound, one sniff was enough to keep him on the trail for three years. The Vermont-based writer was in Barolo in 2018 and on his way to the table, when he passed a giant white truffle under a glass cloche. Instinctively he lifted the dome: “I didn’t even make it to the table. Such a crazy smell. I was destroyed at the luncheon – I kept thinking about the truffle,” he tells me. That one flare of the nostrils had him hooked, and he’s been following truffle hunters around Europe ever since. His book follows his adventures – discovering “dreamers, schemers, and some extraordinary dogs” along the way. Piedmont is considered the home of the truffle – with the annual fair in Alba (running from October to December) the epicentre of the trade. White truffles (tuber magnatum), as found in Alba, are the crème de la crème of the truffle world – distinctly seasonal, flourishing in the autumn and winter. This brief window of opportunity is key to their appeal. As Donald Edwards, Head Sommelier at La Trompette, says, “What else can you have where the stopwatch of deliciousness is literally ticking by the table?” Of course, not all truffles are created equal. Black truffles are a third or a quarter of the price of white truffles and offer a very different aroma. Jacobsen describes “more pungent, more overwhelming” and “invigorating” scent of white truffle as “garlic, salami, almost gasoline” versus the “comforting, soothing, round” notes of “cured olives, cocoa and hazelnut” that he associates with black truffles. And while there is only one white truffle, there are two types of black truffle: the black winter truffle (or Périgord, tuber melanosporum, now mostly grown in Spain) and the black summer truffle (tuber aestivum, sometimes known as the Burgundy truffle but found all over northern Europe, including southern England). The latter, more widespread breed is not nearly as intense as its winter sibling, meaning more is needed for the same impact. One reason that white truffles carry such a premium is also that they have – so far – proven impervious to cultivation (although scientists in France have recently claimed to have cracked this). The truffle hunters, or trifulau, in Piedmont are therefore unsurprisingly secretive about where they find their treasure. Often speaking only a local dialect, these foragers roam the woods – often under the cover of darkness in search of “white gold”. Their dog will sniff their way to the right spot, pawing the ground and patiently waiting for their master to dig up their bounty. “It’s a billion-dollar industry totally dependent on dogs’ noses,” Jacobsen says, laughing at the absurdity. While the hunters might avoid the limelight, it’s not the case when it comes to their dogs, Jacobsen tells me. The canine connection is taken to the next level when you also depend on a four-legged friend for your livelihood. While pigs were the original snouts charged with sniffing out truffles, hunters switched to dogs in the 17th and 18th centuries. Lagotto Romagnolo is the “traditional” truffle-hunting breed (and comes with an associated premium, given their potential return), but today almost any dog is used. They simply need to be trained and have the right nose for the job. “Good ones are amazing,” Jacobsen tells me. “They can find a truffle 50 yards away in the forest and they just know it’s there.” Trifulau Luigi Rosso has been – along with his dog Danko (aged seven) – sniffing out the good stuff for 30 years. While it might look easy, he says that it’s incredibly difficult and can be dangerous for both hunters and their dogs, traipsing through forests in the dark. It is, however, all worth it for him. “The tranquillity that is in the air while you go for the truffles. The moon, the silence and only the sound of your footsteps on the damp leaves, then the joy of your dog when it finds one…” he tells me. The unique scent of truffle is what drives connoisseurs to seek them out – bidding on the finest examples for extortionate sums. “I feel like they've evolved to hit some deep pleasure receptors in our brains. When they're good you just want to luxuriate in them,” Edwards says. William Lowe MW – the man behind Cambridge Distillery – set about capturing the elusive flavours of truffle in his quest to create a digestif-style gin. The idea was born when looking at the digestif trolley in a Michelin-starred restaurant – and a sommelier who was scornful at the idea of a gin worthy of joining its ranks of fine Cognac and single malt whisky. “If you look at those rare and mature examples, you’ll see that the oxidative maturation process creates these beautiful earthy aromatic profiles sometimes referred to as ‘forest floor’. We wanted to achieve this profile through distillation rather than maturation, and truffles gave us the perfect route to do so,” Lowe says. “It took me a very, very long time. Because truffles are hard to deal with. They are packed full of volatiles, which is to say that truffles smell more than they taste,” the Master Distiller explains. “If you think it through – every time you open a door to a restaurant that is serving truffles, bang you get it straight away. But if you look at the food they serve truffles on and it’s always almost neutral dishes: creamy pasta, mushroom risotto. It’s never on super flavoursome dishes because if it is, you can’t taste the truffle anymore.” The challenge, however, was capturing something that doesn’t want to be caught, and finding the right level of truffle. “With truffle, chefs will normally do one of two things: either they’ll know you know it’s expensive so they’ll use loads of it so you can’t taste anything else for the rest of the meal – or they’ll do the opposite. They know that you know it’s expensive so they use so little that it’s the Emperor’s new clothes – you sort of have to search for it. It takes a genuinely skilled chef to use truffle well. And using it well is when you get all of that amazing aroma but you can still taste the other things.” This was what Lowe was aiming for – but it wasn’t easy. He spent months refining the distillation technique for truffle, but the flavour was only “ok”. He went back to the drawing board and decided that the problem was the truffle he was using – black wouldn’t cut it. “We went straight to Piemonte – white truffles from Alba. Gram for gram, worth more than gold […] and it came out and tasted a lot better than gold does so that’s an easy trade,” says Lowe. For trifulau Rosso, you need at least 10 grams on a dish (whereas, he says dismissively, restaurants will often only use a measly five) – with homemade tagliarini top of his list, although he also suggests trying it on panna cotta. He considers Pelaverga – a rare red variety that’s native to Piedmont – the classic pairing, but otherwise goes for one of the region’s other reds, Barbera, Barbaresco or Barolo. These are undoubtedly the classic pairings, following the simple rule of what grows together goes together. However, Jacobsen or Edwards don’t agree. “It couldn’t be more wrong. It really requires a white. The tannins clash with the aromatics,” Jacobsen says. The truffle specialist opts for Champagne, white Burgundy or cool-climate Californian Chardonnay – even Beaujolais. As for Edwards, he likes something that plays on the delicacy’s textural quality: “They work so well with buttery, umami-laden cheese sauces that I can't not want really classy Chardonnay. I want bâtonnage, I want really expensive but underplayed oak and I want ripeness with a gimlet-eyed stare of terroir behind. Basically, Burgundy, Mornington or the best of the Santa Rita Hills (I'll accept that other places also make perfect wines for this), plus if I can have a few years in bottle to build that sous bois flavour connection then all the better.” At the time of writing, we’re in the midst of the 2021 truffle season – one that has brought eye-watering prices. The hot, dry summer in Piedmont (unlike the wet conditions experienced in northern Europe) has led to a tiny crop – some say the smallest in history, driving prices up. Bloomberg has declared it “The Great White Truffle Crisis”. The white truffle needs such specific conditions that climate change, and – as Rosso tells me – the warmer autumns in Piedmont, pose a serious threat. While we consider Alba the spiritual home of white truffles, today most come from elsewhere. Both Central Italy and Le Marche, but also Romania, Serbia, Croatia and Hungary are all now hotspots for truffle hunting. Many of these regions are benefiting from the shift in climate, now having the ideal conditions to nurture the rare tuber magnatum. As for black truffles, the summer variety can now be found as far north as Sweden, but drought conditions mean that irrigation is becoming essential for existing orchards. Beyond climate, there are other challenges. In Piedmont, there are fewer forests than there once were, with more profitable vineyards replacing woodland (another reason that hunters are looking elsewhere). Also, the local trifulau are – in general – an ageing group. One truffle hunter, Carlo Marenda, has established a non-profit, Save the Truffle, to try and protect the region’s truffle hunting heritage – both by passing on the tradition to younger people and protecting the forests, nurturing the right environment for truffle growth. “It used to be that these forests were very actively used by farmers, peasants – fallen wood for firewood, leaves for animal bedding etc. So forests didn’t have a lot of undergrowth,” Jacobsen explains. “But then the world changed.” With the forest floor not being cleared, decaying matter acidified the soil – something that truffles hate. Truffles thrive in high pH soils, which is why they’re found on beds of limestone. To ensure the forests provide a welcoming home for the tubers, it’s essential they’re managed correctly. While there are certainly challenges to preserving the truffle’s place in Piedmont, the good news for gastronomes is that these tubers aren’t disappearing – just moving. After three years on the trail, Jacobsen is as enchanted by truffles as when he began. But he’s less keen on the hierarchy that comes with them. There are, he says, plenty more species of truffle beyond those currently on the market – but hunters can’t sell them, so keep them for themselves. He hopes the truffle culture will shift to grassroots foraging, rather than “waiters in tuxedos grating your precious morsel over your pasta”. However it reaches your table, it’s clear that the truffle holds a special allure – and the transience of its elusive scent, fading with the seasons, is what keeps us on the hunt. Chasing truffles

After the stresses of 2020 – with severe drought, heat and widespread wildfires, the 2021 vintage provided much-needed relief for Napa’s wine producers. Not only was the growing season reassuringly uneventful, but the resulting wines are fantastic. Concentrated, pure with vibrant acidity, this is a vintage that sits alongside 2013, 2018 and 2019 – the best in recent years. “I’m very happy to move on from talking about 2020! It was stressful to go through and stressful to relive,” said Maya Dalla Valle, winemaker at the eponymous estate founded her parents. Most winemakers and vineyard managers held their breath as the 2021 season progressed, anxious about the potential return of hazardous wildfires that increasingly seem to be the new normal in Northern California, but the danger never materialised.   The most significant factor influencing the 2021 harvest was instead drought, which unfortunately entered a second year. Conditions were exceedingly dry – historically so, says Chris Phelps of Ad Vivum, who noted that it was one of the driest years he can remember. Napa’s Mediterranean climate dictates that nearly all precipitation falls during the months of October-March, and the rains generally begin in the weeks following the close of each harvest, but this didn’t happen in 2020. While early winter was quite cold, helping to push the vines into dormancy, but rain didn’t arrive until January, February and March 2021. With around seven inches measured in Oakville, this was significantly lower than normal and far less than the total amount needed to reinvigorate the roots and replenish the water table.  Access to water, either from precision irrigation, or the benefit of a location with good water supply, therefore, was critical to shoot growth and canopy development. Sleeping Lady Vineyard in southern Yountville – the fruit from which Ad Vivum is crafted – backs up against the Mayacamas Mountains that form the western edge of Napa Valley. Here, natural springs funnel moisture down to the vineyard. In other locations, such as the eastern hillsides of the valley, long sunlight hours and faster-draining soils presented a greater challenge. The solution at Dalla Valle was to begin irrigation much earlier than normal, and at a greater volume, in order to mimic the rainfall that didn’t happen naturally. Although 2021’s growing season was quite warm, it was cooler than 2020 and, importantly, there were very few heat waves – and those that did take place were mercifully short. The first of these spikes, where the daily temperature reached over 37˚ Celsius, occurred in mid-June, a point early enough in the growing season where its impact was negligible. The remainder of the summer was consistently warm, with little variation, up until late August and early September, when the valley saw two minor heat spikes. The diurnal swing that Napa is known for, with nights quickly cooling down after sunset, was also in full effect in 2021, helping to preserve the grapes’ natural acidity. Given the steady weather and lack of wildfire risk, winemakers had the luxury of time when deciding to pick. For most, harvest began in the first two weeks of September – slightly earlier than average, but not drastically so. The year’s dry conditions reduced yields, which was not surprising, though “sometimes harrowing” as Andy Erickson (of Favia, and star consultant winemaker) described. The resulting clusters were lighter than normal, comprised of small berries with thick skins. While Phelps reported that the yields at Ad Vivum were down by 15%, he emphasised the positives that have emerged from these small, compact clusters: “The colour is extraordinary, with higher than normal levels of anthocyanins due to the long, slow ripening.” Others reported an even more drastic reduction in yield – up to 30% in some locations – though variation depends on not just access to water, but also soil type and depth. Vine age can also help mitigate drought conditions. Lisa Togni of Philip Togni Vineyard, perched at nearly 2,000 feet at the top of Spring Mountain, said that her yields were more or less normal, something she credits to the 32-year average age of her vines, which, remarkably, have never been irrigated. She feels that her vines’ well-established roots are able to reach deeper and access more water than younger vines. The low yields also sparked some wineries to change course in the vineyard prior to harvest, in regard to both shoot thinning and dropping fruit. Opus One made the decision to halt their green harvest. This process – during which a certain number of clusters per vine are removed, lowers yield and increases the intensity of the remaining fruit while also eliminating any slightly under- or over-ripe clusters – was always standard for Opus One, as it is for many wineries in Napa. This decision to change course was an easy one to make in a year like 2021, winemaker Michael Silacci said, and he is thrilled with the results, describing “more of a range of ripeness, with more layers and texture, and more vineyard character” in the final wine.  In the winery, tannin management was crucial. With a reduced skin-to-juice ratio, it was important to handle the fruit gently. For Tony Biagi, winemaker at several Napa Valley wineries, including Hourglass, Amici, The Vineyardist and To Kalon Vineyard Co, the main puzzle was how to coax colour from the fruit, while avoiding over-extraction of the tannins. “We were meticulous in how we macerated; we shortened the window,” he explained. Biagi said that the firm tannins are reminiscent of 2013, though perhaps not quite as muscular, as the more stable weather of 2021 allowed “more time to buff the edges”. At Dalla Valle, the decision was made to leave the wines in barrel for an additional two months because they displayed so much power and concentration. Despite the smaller berries and low yields, the condition of the fruit was described as nearly perfect by everyone. Low disease pressure and the lack of heat spikes produced uniformly healthy, good-looking clusters. Silacci recalls perhaps the most worrying moment of the 2021 harvest at Opus One, when their optical sorter broke down just as the fruit began arriving at the winery. Fortunately, however, the quality of the fruit made a stressful moment less so: “If ever there was a vintage we didn’t need a sorter it was 2021!” Early impressions of the final wines are uniformly positive – glowing with praise, even – and not simply because the year was a welcome relief following the trials of 2020. As we found in our tastings, the wines offer concentration and intensity with real purity of fruit, all balanced by refreshing and somewhat surprising acidity – allowing them to age beautifully. Phelps noted that the 2021s remind him of 2016, 2018 and 2019, all vintages with “great concentration, tension and generosity”. For Biagi, the vintage instead portends a new direction for the region, while referencing other hallmark great vintages of the past. “For me, the 2021s are classically Napa Valley. They are not crazy ripe, and you get a sense of the new style Napa is moving towards, with both power and freshness,” he opined. Inside Burgundy – Jasper Morris MW  Jasper Morris MW’s upbeat report assures the reader not to panic about the treacherous growing season that Burgundy endured in 2021: “The wines taste much better than the weather conditions might have suggested.” While wary of generalisations, he feels the whites (what little was made) were good to very good and readers should have no qualms in following them. While the natural comparison might be to 2016 – another vintage badly affected by frosts which produced two generations of grapes – those that survived the frost and the secondary buds – the 2021s avoid the sweet-and-sour profile of that year. He also particularly highlights the wines of Puligny-Montrachet, which has rediscovered a “beguiling and refined floral bouquet” in the year.   
Quality among the reds, he feels, is less consistent, with the Pinot Noirs from the Côte de Nuits better than those from the Côte de Beaune. He highlights Chambolle-Musigny and Volnay as appellations that “show the elegance and fragrance… that has perhaps been missing for the last few years”. While far from classical, he believes many of the reds are “rather lovely in a style which we have not seen in the last few years”, thanks to the vintage’s cooler conditions.   
He compares the reds to 2014, but less “raw” than some of the wines made in that vintage, while the whites remind him of 2013. He also suggests the vintage for both red and whites has many similarities to 2010 – a vintage that received modest reviews on release, but has, with maturity, turned out to be “rather fine”.   
For him, both colours, although especially the whites “are very clear reflections of their individual sites”, and “show the hierarchical order from generic up to Grand Cru very clearly”. While he doesn’t feel they will “develop into legendary long-lived wines”, nor will they “fall over quickly”. Generally it is a vintage that is “what the French call digeste” – “accessible, easy to drink”, but he urges readers to “take the time to search out the gems which have successfully avoided any pitfalls in their path and will emerge as truly beautiful wines”.

Vinous – Neal Martin 
Neal Martin offers, as ever, a long report, with his trademark satirical opening. His verdict is that 2021 is “indisputably one of the most fiendishly complex, byzantine seasons I can recall” and the wines are “shockingly good in the context of an appalling growing season that pushed many to the brink, physically and mentally”.  He runs through the growing season in detail, noting the various challenges producers faced and how they responded – something which he highlights varied significantly, making it “a season without consensus”. Despite these difficulties, he finds many of the wines “blooming delicious” – noting that “the causal relationship between the vagaries of a growing season and wine quality is not as strict. Seemingly awful vintages can be studded with vinous gems and walk-in-the-park seasons can disappoint.”  Given the lack of consensus, he emphasises the variability of the year, and the need to drill down into the specifics of how each estate, and vineyard, fared – and he has offered a profile on almost each producer he visited to provide his insight. He points to the fact, for example, that the Grands Crus aren’t necessarily the best wines from each estate – and this is reflected in his scores. As for the style of the wines, he finds that the whites “sometimes convey traits of warmer vintages with traces of tropical fruit that counterpoint the acidity”, and points to Chassagne-Montrachet as a stand-out village – in his view, “the most dynamic appellation in the Côte de Beaune”. The reds he declares “a sharp return to the vivid red fruit of cooler growing seasons” – with most “far removed from the black/blue-fruited 2019s and 2020s”. “There is greater underlying mineralité, tension, and vibrancy on the palate compared to recent vintages. Tannins, at best, are finely chiselled, and the finishes often contain plenty of sapidity.”  
Overall, however, he feels that “the 2021s will offer abundant short to mid-term drinking pleasure” and are “delicious early-drinking fare”, but “only a small number will age long-term”, some wines not having “the substance to last the course”. Despite that, he’s overall positive, although notes that the tiny volumes and rising prices pose challenges: “There are gems to find. It’s just that you might not be able to buy them, and if you can, you might have to remortgage the house.”

 Burghound – Allen Meadows 
So far Allen Meadows has published his reports on the Chablis, Mâconnais and Chalonnaise, and reds from the Côte de Nuits. His in-depth report runs through the varying meteorological considerations across the entire length of Burgundy, including for example a catastrophic hailstorm in Pouilly-Fuissé. For the whites from the outer reaches of Burgundy, he says that, “despite all of the growing season trials and tribulations, surprisingly good, sometimes even excellent, whites were made”. There are, in his view, some “cool, pure and wonderfully transparent whites that are intense, overtly saline and well-balanced” – but he emphasises that this is not a consistent vintage and selection is important, with quality varying. He feels “it’s not an easy vintage to pigeonhole” – and compares some wines to 2001 or 2013 for their exoticism, some to 2014 or 2017 for their restraint and freshness. From the Chalonnaise, he particularly highlights the wines from Joblot and François Lumpp for reds that are “lovely: fresh, energetic, reasonably concentrated, transparent and balanced”. When it comes to the Côte de Nuits, “quality is highly, even frustratingly, variable”, but “2021 is the kind of vintage that I absolutely love”. It is, in Meadows’ view, “a burg geek’s vintage par excellence" – with terroir transparency at its heart, with wines that are “strikingly refreshing and tension filled”. Many will make for “delicious drinking early on, yet be capable of amply rewarding mid-term cellaring and in a few cases, they should be as long-lived as most collectors would reasonably want” – with the caveat that some, unfortunately, are not. He highlights how work in the vineyard was key, tactics in the winery varied and picking dates too – noting that generally those who picked later fared better, but (in a running theme for the vintage) that is “far from a hard and fast conclusion”. Although most are medium-bodied, he feels that some producers shied away from extraction – with the result that some wines don’t quite have sufficient mid-palate density. With the quality varying, it’s a year to focus on “producer first, second and third rather than the commune”, although the classification hierarchy is clearly reflected in the quality of the wine. This is, most importantly, a vintage that is the opposite to 2018, ’19 and ’20, and he feels the closest comparison for the reds is 2001, with a similar 10- to 20-year arc of ageing ahead of them.  There are some wines that are underripe or herbaceous, but: “The best wines are classic Burgundies in the best sense of that term. They have something of everything in terms of a tantalizing freshness as they are decidedly very pinot in character followed by a dazzling transparency on the palate. As I noted above, the sense of terroir is at the core of each wine, and when a palpable sense of energy is added, the wines are a joy to drink.” Read Allen Meadows’ full report, notes and scores on the Burghound site Decanter – Charles Curtis MW The headline of Charles Curtis MW’s report is that there are “some excellent wines, if you choose carefully”. The “antithesis of recent years”, he anticipates that those who are selective will “be delighted by the classic style of this vintage”, which has produced “crisp, concentrated” whites and – at their best – reds that are “perfumed, elegant and structured”. He emphasises how important the harvest date was, as well as sorting once the fruit was picked. Although he found significant variability in quality – “with liltingly charming wines alternating with less successful examples” – he is clear that “the best wines are definitely worth buying”. His wines of the vintage are Domaine des Comtes Lafon’s Montrachet and Armand Rousseau’s Chambertin-Clos de Bèze – wines that, sadly, few will be able to get their hands on.  Read Decanter’s full report, notes and scores Jancis Robinson MW Jancis Robinson MW’s site offers extensive coverage of the vintage mainly by Burgundy-based Matthew Hayes and herself, with extensive tasting notes. Jancis’s own report – based on tastings mainly in London and published in early January 2023 – vouched for the quality of the fruit at harvest, and how despite “a gruelling growing season”, with the results that she had so far tasted “delicious”.   Matthew Hayes doesn’t shy away from this being a “difficult” vintage, but “quality has been unexpectedly higher than received wisdom suggested”. Beyond the challenges of the growing season, Hayes highlights how the winemaking was handled differently almost everywhere, although generally people reduced extraction. He’s wary of giving the year “the kiss of death” by declaring the vintage “merely good”, but considers how there’s more to greatness than ageability. For him it is a vintage that “will appeal to real cognoscenti of Burgundian Pinot Noir, to the absolute devotees of fragrance, limpidity and soft, ethereal tannins – that gossamer touch that normally speaking should take decades to evolve”. The wines are earlier-drinking given how open they are – a relief in some senses that you needn’t feel too guilty of “infanticide”.   Read all Burgundy 2021 coverage on jancisrobinson.com Wine Advocate – William Kelley William Kelley’s greatly anticipated report is his longest to date. He feels that the complexities of 2021 and what he sees as a pivotal moment for the region deserved the extra word-count. He runs through the year’s conditions in detail, which we won’t regurgitate, although – contrary to our findings – he suggests the Premiers and Grands Crus were harder hit by the frost. Like us and others, he highlights that strategies in the winery varied significantly and generalisations are almost impossible. He considers what “a great red wine vintage” is in the era of modern Burgundy and climate change – and whether the 2021s’ openness will work against them. They are, he says, “supple, fleshy and perfumed, at their best uniting the concentration of low yields and surprisingly good phenolic maturity with the vibrant, perfumed profiles of a cooler vintage”, “broad, open and charming” and, in his view, “unlikely to shut down”. He compares the wines to 2017 or 2000, and expects they will at least age as long as the latter.  As for the whites, he finds them “classically proportioned, pure and fine-boned, albeit sometimes a little lean out of the gates”. The closest comparison for him is 2013, although without the exoticism sometimes found in that vintage. He highlights that the wines are developing texture and flesh during élevage and will show better from bottle than barrel. Of course, he cautions readers that they will need to “buy wisely”, but highlights that, even tasting over 1,000 wines, there were “very few failures” – with the year’s results far more positive than he expected from the difficult year. Indeed, he even declares them “some of the most charming young Burgundies [he has] tasted from barrel over the last 15 years” – but, he asks, “Are they too tasty to be great?” As for the market, he notes that “the 2021s will be expensive”, but this is tied to not just demand, but land prices in the region, as well as its archaic inheritance laws and significant taxes. The inevitable result of these factors is consolidation, and while once the nobility and Church held the keys to the land, now it’s billionaires and corporations – with the future of small, family-owned domaines in doubt.
