What springs to mind when you think of Bordeaux? Probably châteaux the size of medieval palaces, formal dinners, and rows and rows of pristine vines, neatly manicured rose bushes the only other signs of plant life. What you’re unlikely to be imagining are cow horns stuffed with manure buried in the ground, or horse-drawn ploughs churning through earthworm-rich soil. ‘In the past, in Bordeaux, you were scared to say you were growing biodynamically,’ says Corinne Comme, who manages 10ha of biodynamic vines at Château du Champ des Treilles in Entre-Deux-Mers with her husband Jean-Michel. ‘Now it’s trendy.’ An engineer and geologist, Jean-Michel Comme was behind the first transition of a grand cru classé estate on Bordeaux’s Left Bank to biodynamics. Although he and Corinne first came across the concept in the mid-1990s, he didn’t begin to advocate for the approach at Château Pontet-Canet in Pauillac until the early 2000s. ‘Corinne was scared,’ he recalls. ‘She thought they would fire me.’ "Behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength" Originally laid out in a series of lectures by Austrian philosopher, scientist and social reformer Rudolf Steiner in 1924, biodynamic farming emerged as a holistic approach to agriculture before quickly evolving into formal certification movements. At its core, biodynamic farming centres on soil health and biodiversity; most distinctively, it operates according to the lunar calendar, with practitioners timing agricultural activities around specific ‘fruit days’, ‘root days’, ‘leaf days’ and ‘flower days’ to align with cosmic rhythms believed to influence plant growth and agricultural processes. For many in Bordeaux – Jean-Michel Comme included – this all sounded a bit wacky. ‘I was young, full of expectations about chemistry; the way biodynamics was presented was so remote that I felt it was crazy,’ Comme says. ‘But with experience, we did change our minds.’ Why? Because behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength. In vineyards, biodynamic farming means specific practices such as hand-harvesting, using natural composts made with specific herbal and mineral preparations, avoiding chemical fertilisers and pesticides, and treating the entire vineyard as a self-sustaining ecosystem. In the cellar, there’s an emphasis on minimal intervention, using native yeasts, avoiding commercial additives, keeping sulphur use to under 70ppm, and employing gentle pressing and ageing techniques that respect the wine’s natural development. While biodynamics took root in regions like the Loire and Burgundy in the 1990s, biodynamic winemaking in Bordeaux largely began in the new millennium, with just two early St-Emilion exceptions: Château Meylet, which has been practising it since 1987, and Château Fonroque, experimenting since 1995 with direction from Loire legend Nicolas Joly. This delay largely stemmed from two factors. First, Bordeaux’s humid maritime climate means that vines are especially vulnerable to both downy and powdery mildew, making the avoidance of synthetic fungicides a risky business. Second, large châteaux with multimillioneuro operations were reluctant to abandon the technological viticulture and winemaking that had built their global reputations in the first place. Comme, however, was convinced of the virtues of biodynamics. He began by seeking the assistance of François Bouchet. The Loire Valley winemaker was one of the first in France to pioneer biodynamics, also consulting for Domaine de la Romanée-Conti, Domaine Leroy and Domaine Leflaive in Burgundy. Bouchet guided the transition to biodynamics at Comme’s Château du Champ des Treilles; then, he persuaded Château Pontet-Canet owner Alfred Tesseron of its merits. In 2004, it was trialled on 15ha (about 20% of the estate’s total growing area) of the fifth growth at which Comme was also technical director. A severe mildew outbreak in 2007 led to the use of pesticides, undoing three years of progress, but it then became a crucial lesson that strengthened their long-term commitment to biodynamics. ‘They believed the fruit had more expression, more brightness,’ says the current technical director at Pontet-Canet, Mathieu Bessonnet, who reveals that they converted the whole of the growing area soon after. ‘It’s obviously much more difficult, time-consuming and expensive, so it was very risky,’ he adds. Since then, biodynamic farming has become a significant and growing practice across different classed growths in the region, with some of the most prestigious estates – such as Château Latour and Château Palmer – adopting biodynamic methods (the latter certified). ‘The link between the wines and the place where the fruit came from had become less and less obvious,’ says Château Palmer’s technical director Thomas Duroux, commenting on the region’s turn to the trend. He notes that, since the noughties, many have adopted organic practices in a bid to reverse this perceived drop in terroir definition. ‘Biodynamics is, in a way, the same story as organic farming, but with a larger vision,’ he adds. This shared perspective has led to more cooperation between practitioners. Every spring, the Médoc branch of the Biodynamic Agriculture Movement gathers at Château Ferrière. After unearthing a thousand manure-filled cow horns and replacing them with silica-filled ones (a process reversed in autumn to produce preparations 500 and 501, required for Demeter certification), participants share wines and gardengrown salads. The humus removed from the cow horns is stored in a cold, damp facility and made available to members. ‘We do that for free,’ says Claire Lurton, owner of Château Ferrière. ‘It’s a community.’ Though ‘community’ might be too strong a word for some, these gatherings symbolise a deepening professional exchange that has emerged among estates of all sizes through the practice of biodynamic winemaking. In fact, the shift among the classed growths has happened at the same time as these practices have been adopted by smaller growers arriving in the region. Christophe Landry of Château des Graviers, for example, returned to Arsac in the 1990s and began practising biodynamics around the same time as Comme at Pontet-Canet. He’s consulted for the Lurton estates and other properties. Originally from Minervois in Languedoc, Michel Théron established Clos du Jaugueyron nearby and has been certified biodynamic since 2008, while Laurence Alias and Pascale Choime – who are both from southwest France – established Closerie des Moussis, a patchwork of sites across 2ha, including a 170-year-old pre-phylloxera plot leased from Théron. On the Right Bank, other producers began switching lanes even earlier. Le Puy, owned by the Amoreau family, began practising in 1998, with certification since 2013, and Château Gombaude-Guillot in Pomerol has been certified biodynamic since 2006. While larger estates like Latour and Palmer collaborate on issues like mildew, smaller producers tend to engage more with one another. Shared biodynamic practices, however, are definitely helping to break down barriers. For example, Château Haut-Bages Libéral maintains regular communication with its neighbours at Château Latour, and the son of Théron at Clos du Jaugueyron interned at Château Palmer for two months. Can we speak of a unity of praxis? Not exactly. There is considerable variation in which aspects of biodynamics winemakers emphasise, regardless of estate size. The primary aim across the board is achieving living soil with rich biodiversity to promote deep-rooted vines. In pursuit of this, some winemakers emphasise tree growing or cover cropping (like Haut-Bages Libéral, which also recently planted a variety of local and fruit trees). Others, such as Le Puy, let nature take its course, allowing a diverse array of plants and flowers to sprout from the earth. Whether certified or not, biodynamic practitioners throughout Bordeaux use homeopathic treatments like nettle teas for the vines – they are believed to stimulate soil health, enhance plant immunity and improve nutrient uptake. More important than any of this, however, is the concept of energy. How can the energy of the plant be retained as its raw material transforms into wine? Every winemaker I visited was at least intrigued by the concept – and most were captivated. After a few days in the sometimes eerily flat Médoc, I drive through the verdant hills of St-Emilion to Le Puy, arriving with a raised spirit. Standing before a 5,000-year-old Celtic cromlech, Harold Langlais, the estate’s director, tells me, ‘Le Puy is a place of energy and life,’ pointing to its deep history as an intersection of water springs. At modern-day Le Puy, this philosophy extends from the vines to the cellar. Indeed, many others I speak to express that, since adopting biodynamics, the most striking change in their wines has been an increase in ‘energy’. It’s a term without a precise definition, but according to Château Palmer’s makers, something shifted with the 2015 vintage, the second year after full conversion. ‘You cannot measure it,’ Thomas Duroux says. ‘You can just feel it.’ At Château Durfort-Vivens, where the vineyard was operating under biodynamic principles by 2013 (with full conversion by 2016), owner Gonzague Lurton recalls the 2014 vintage as ‘the first where you really feel the energy of biodynamics’. It’s tactile and warming, with a sophisticated grip and charm. ‘It’s what I love – the linearity of tannins, never weak from start to finish. With many of the estates I visited, their wines showed an immediate appeal, vibrant even in their youth. Is energy just another way of describing freshness? Laurence Alias at Closerie des Moussis trained as an agricultural engineer; for her, energy and vitality are tied to the physical properties of grapes grown biodynamically. ‘We have more acidity, that’s an analytic fact,’ she tells me, standing in front of a newly acquired plot of vines bordered by forest. It might be romantic to think of energy as something ineffable, but it’s also rooted in what remains within the grapes. ‘Our idea of energy is based more on Einstein than Steiner,’ Langlais later qualifies. ‘Energy is matter.’ Biodynamic winemaking in Bordeaux: five to follow Château Pontet-Canet At the 55ha Pontet-Canet estate in Pauillac, an immensely smooth operation is palpable. Winemakers here have spent almost two decades honing their biodynamic craft, continually moving towards a goal of self-sufficiency for the estate. Sturdy Comtois horses, introduced in 2008, now work half the vineyard, preventing soil compaction. Vineyards are sprayed over a single day using compost and herbal teas produced from plants grown in and around the property and processed in the state-of-the-art infusion room. Biodiversity-boosting fruit trees and hedges have been planted. The estate even employs a carpenter who repurposes wood from vats used on the property. Ageing involves custom-made wooden eggs and qvevri-style amphorae, with no fining and minimal filtration. The result? A Pauillac with untypical levels of energy and minerality, and a plush, velvety texture. But it’s more than that – according to Bessonnet, thanks to a low-intervention approach across the board, ‘you can really feel the soil.’ Château Palmer Thomas Duroux’s conviction in biodynamics is based in what he calls a ‘holistic vision’. ‘We started to see the entire place as a living organism,’ he says of Château Palmer, one of the most storied and historically significant third-growth estates in Bordeaux. When converting (a process that started in 2009), the Margaux estate was initially guided by François Bouchet’s son Matthieu, but now it follows its own evolving philosophy, integrating cover crops, animals for fertilisation and estate-grown vegetables and meat. ‘It’s just going back to agricultural common sense,’ Duroux says. ‘That was the way to grow anything before World War II.’ This respect for nature results in wines that are deeply tied to their terroir. ‘If I had to describe the wines how they are today, compared to how they were before, I’ll just say that it’s not a revolution, but we have the feeling that the wines have a better identity,’ says Duroux. He likens biodynamics to restoring an old painting: ‘Suddenly, you see small details that you were not able to see because of the dust.’ The estate uses stainless-steel vats for fermentation and temperature-controlled rooms for barrel-ageing, combined with nativeyeast and low-sulphur winemaking, to produce its esteemed Alter Ego and Château Palmer cuvées; both have been increasingly celebrated among critics and drinkers since the turn to biodynamics. ‘We just think it does help to go a little bit further in the interpretation of the place,’ says Duroux. Château Durfort-Vivens Standing over a rustic sorting table explaining how it used to work, Gonzague Lurton is visibly passionate about the savoir-faire of the past. This sensibility is reflected in the current winemaking practices, too, and in the second-growth Margaux estate’s reputation (and critics’ scores) increasing year on year. The thing to emphasise is that what began with a biodynamic approach in the vineyards led to a series of domino effects that changed the character of the wines. In search of what Lurton calls greater ‘singularity’, the proportion of Cabernet Sauvignon had already risen to over 90% by 2014 (from around 75%); and with the use of indigenous yeasts during fermentation and the reduction of sulphur levels over time (initially sparked by Demeter’s upper limits of 70mg/l), the wines have become more aromatically complex and expressive. The introduction of amphorae by Italian producer Tava has allowed for microoxidation without overextraction, contributing to a more delicate balance of flavours, with the 2019 estate wine a blend aged one third in amphorae and the rest in barrel. ‘It’s not a big wine,’ says Lurton. ‘And it’s what I was looking for with biodynamics, in terms of style.’ Château des Graviers Christophe Landry’s pioneering status in Margaux stems from an instinct refined over decades at his own estate. He grows medicinal plants — horsetail, absinthe, calendula, chamomile — for vineyard treatments, as well as using the manure from his own cows. ‘What we need to remember is that biodynamics isn’t just a practice,’ he tells me. ‘It’s about finding your own path to self-sufficiency.’ His precision extends to the cellar, where he uses concrete tanks, amphorae and oak barrels (produced according to the biodynamic calendar) tailored to each of the five cépages’ oxygenation needs, then ages the wines for different lengths of time. Timing is everything, with harvest choices also following the biodynamic calendar. Obsessive care for the vines’ life cycles goes hand in hand with the level of precision in the cellar. The outcome is two phenomenal wines that are, as Landry puts it, ‘thirstquenching’. Château des Graviers and Quintessence — which contains a higher proportion of Petit Verdot and is aged longer in barrel and amphorae — are aromatically expressive, velvety and strikingly lively, with the latter offering more depth and an enveloping finish. Expanding to 18ha, Landry has also turned his focus to Clos Dufourg, cultivating vines on previously wild land nearby and hand-building a striking new cellar with cement tanks painted with clay from the surrounding earth. Le Puy For technical director Harold Langlais, the Le Puy estate’s significance lies in how it challenges Bordeaux’s conventional identity. Outside of the region’s traditional focus on appellations and classifications, Le Puy sits on a plateau near St-Emilion. The estate’s land is unusual, with no topsoil but a deep limestone bedrock beneath red-brown clay, which forces the vines to develop deep roots to access the earth’s natural water and nutrients. This is further supported by horse-ploughing and biodynamic sprays made from horsetail, buckthorn and nettles, which grow on the property. ‘Our approach focuses on rooting the vine deep,’ Langlais explains, ‘encouraging it to search out hidden nutrients.’ A vigorous wind circulates around the vines, and Langlais explains the effects of the elements. ‘The beauty of Le Puy is that it’s an acid factory. The whole place creates acidity in the berries.’ The biodynamic philosophy extends to the winemaking, with two different processes applied to their 100% Merlot cuvées. Cuvée Emilien uses a ‘decantation method’, or ‘fermentation by infusion’, while Barthélemy is produced with zero sulphites and a process of lees-stirring called ‘dynamisation’, which is done on fruit days and involves a specific motion to create a vortex in the old barrels it ages in. ‘Barthélemy is much more intense,’ Langlais says. ‘All the matter taken by the plant is in there.’

Seeking simplicity in statistics, complexity in wine, and everything else in fortune cookies 

South Africa is one of the most exciting wine-producing nations right now. A new generation – led by the likes of Eben Sadie, the Mullineux, Chris Alheit and many more – has put the Cape firmly on the fine wine agenda. Its pinpoint Chenin Blanc, serious Syrah and laidback winemakers have made it the darling of the industry – yet this modish group of surfer-cum-winemakers seems a world away from the sweet wines of Constantia.  “Constantia Wyn” was South Africa’s original vinous export – savoured by the good and great of the 18th and 19th centuries. Bismarck, Frederick the Great, Louis XVI and George Washington are all noted to have enjoyed it, while Napoleon had vast volumes shipped to him in exile on St Helena (drinking up to a bottle a day) – and it was supposedly the only thing he wished to consume on his deathbed. The wine is mentioned by Dickens, Dumas and Baudelaire, with Jane Austen’s Mrs Jennings in Sense and Sensibility famously recommending it for “its healing powers on a disappointed heart”.  How, then, did such a legendary wine fall from grace? Economic downturn in the second half of the 19th century, followed by the arrival of mildew and phylloxera in the Cape, and the subsequent dominance of the KWV – the state-run cooperative – saw it vanish.  But in 1985, the Klein Constantia property was bought by Duggie Jooste. He replanted the vineyards, built a new winery and worked on overhauling the long-neglected estate. In 1986 he and winemaker Ross Gower produced the first vintage of Vin de Constance – their tribute to “Constantia Wyn” – released in 1990. It was made with Muscat de Frontignan (a particularly thick-skinned clone of Muscat) left to raisin on the vine, producing a luscious sweet wine, with no botrytis influence. It was an instant success – but quality and style was inconsistent, and Vin de Constance was just one wine in the range, rather than a focus.   It was only in 2012 that Klein Constantia embarked on a new chapter. The property had been for sale for a while and, as Vice Chairman Hans Astrom told me, it was “a bit dusty” and severely in need of attention. It changed hands in 2011, with Zdenek Bakala – an American-Czech billionaire – and British banker Charles Harman taking over, merging a year later with the Stellenbosch estate Anwilka, part-owned by Duggie Jooste’s son Lowell Jooste, Hubert de Boüard (of Ch. Angélus) and Bruno Prats (previously of Cos d’Estournel). Matthew Day – who had worked at the property since 2008 – took over as winemaker. While the estate still produces a full range of whites and reds, Vin de Constance is its flagship.  Now, a decade on, the importance of this shift is shining through. Being a “legacy winery” used to be “what got us in the door”, Day explains, but Klein Constantia is no longer trading on its past. The wines made between 1986 and 2012 were experimental, Day notes – with bottlings ranging significantly in sweetness (from 80 to 180g/l residual sugar) – but they were “vital in figuring out where we are going”. His favourites from that era are the 1987, 1991, 1995, 1996 and 2001 (“with 1991 and 1987 being at the top of that list”), but he’s more excited about the wines he’s producing today. “The older Vin de Constances are more in the style of being sweet wines, whereas the newer vintages are just wines,” adds Day.   Since 2012, they have gradually evolved the style, striving for balance and freshness, with increased precision. For Day, the aim is to make “a sweet wine that doesn’t taste sweet”.  The first shifts were in the vineyard, which since the mid-2000s has been farmed sustainably with some organic and biodynamic practices. The team planted more bush vines that ripen and raisin earlier in the season, therefore retaining more acidity. While they used to pick parcels from January to have high-acid components for blending, now – with the bush vines – they can pick a more uniformly ripe crop, yet not sacrifice acidity.  The end goal remains to have as many components as possible for blending, with the harvest team picking in passes and bringing between one and five kilograms of grapes in per day. While the wine used to vary in alcohol and sugar level, they now aim for around 165g/l residual sugar and 14% alcohol – where they think the best balance is found, varying slightly according to vintage.   The 2016 vintage was the first to be made in a new cellar – a practical and hygienic space. As for what actually happens in the cellar, the key changes have been around skin contact and élevage. The must now spends a week on skins, inoculated with a non-saccharomyces yeast to protect them from biological contamination and the development of volatile acidity, extracting all-important flavour compounds, but not phenolics. They then inoculate for alcoholic fermentation, which lasts between one and three months. They also started re-introducing the use of foudre for ageing the wines in 2016. From 2019, the wine will spend its first 1.5 years in new 500-litre barrels (encouraging the evolution of secondary flavours), before being transferred to older foudre for another 1.5 years (giving oak influence but without the ageing effect of micro-oxygenation).   Tasting the 2012 alongside the 2019 highlights the differences. The two vintages were similarly cool, both picked in April, and although the residual sugar is almost identical, the 2019 feels significantly fresher – with a pithy, textured freshness that offsets its sweetness.   This whimsical wine of yore might feel like a counter to the nation’s new wave, but it’s not so, says Day. “For me, Klein Constantia has always been at the forefront of the movement, but in a completely different way. We might not be as trendy as some of the newer producers, but we like to think the work we have done with Vin de Constance over the past decade has shown the world that South Africa has the potential to compete with the best of the best in the world.”   Browse all current listings from Klein Constantia or browse more Editorial

And with 20-plus years’ age, it should be perfect for drinking now. A 2013 Moscato d’Asti from Giuseppe Vajra. It was phenomenal, still gleefully tasty, but now with a touch of extra weight, more waxy lime skin and late-evening summer flowers, heady in its bouquet. Here she was, my white whale, and, boy, she didn’t disappoint.  “Last December, visiting La Morandina in Asti, I asked whether they had anything with a bit of age and lo! a 15-year-old magnum appeared. My stars had aligned for a second time – the wine equally lovely, offering a bit more exotic spice, cardamom and coriander seed along with the sweet creamy lime zest. Crucially, this time I could see the germ of a plan. Each year, I would buy a cast of Moscato d’Asti, building a reserve of Moscato to steadily enjoy over the coming years. I’ll be the Christmas king of deliciously sweet floral fizz. Looking out across the Côte d’Or, the astute might notice a few more gaps amongst the rows of vines than normal. Dig a little deeper, listening to nervous murmurs in cellars around the region, and you’ll hear that there’s trouble below the surface – with a once-favoured rootstock the culprit.  We like to imagine the life of a Burgundian vigneron as one of the happiest in the world; a bucolic existence in the vineyards, or else surrounded by casks, vats and bottles of their gorgeous bottles. We rather enjoy the product ourselves – despite the occasional irritations of a corked or otherwise flawed bottle resulting in a failed experience. Still, the only loss is of that specific bottle. Sometimes there can be clouds in a vigneron’s life, storm clouds. A hailstorm might destroy the crop in one sector of a vineyard: that cuvée disappears off the map for a whole year, the vigneron’s work for the season destroyed in a single half hour. Or, though we have not seen this for many years, an entire vintage may be compromised by torrential rain throughout the harvest. It is hard to imagine what it can be like to lose a whole year’s crop in one go, but how much worse must it be when there is an existential threat to the life of the vine itself. Two recent threats have been the disease esca, known as the black goo in some parts of the world, and flavescence dorée. Both can bring rapid mortality to individual vines, but can be treated. Now there is a new and insidious problem to contend with: one of the key rootstocks widely used in Burgundy seems to be giving up on the job. The 161/49C rootstock has been the favourite for a generation here. The C stands for Couderc, specifically Georges Couderc who bred this rootstock as far back as 1888, shortly after it had become apparent that only vines grafted on to American non-vitis vinifera rootstocks could resist the phylloxera beetle. It is a Berlandieri x Riparia cross, designed to be relatively resistant to active limestone (very important in Burgundy), and is not over-productive: indeed, it has been such an obvious choice for producers looking for quality over quantity that it has been exceptionally widely planted in Burgundy of late. But 161/49C is giving up on its job. The failures were first seen in the south and south-west of France, and are now widespread in Burgundy. The damage was mostly done with more recent plantings: which may have given rise to the theory of the rootstock having intrinsically degenerated. However, another explanation has emerged, that the younger vines do not have deep enough root systems to be able to search out underground water, whereas the old vines with established root systems appear to be able to carry on serenely. The story is still unfolding and I doubt that we have all the answers yet. I learn from Pl@ntGrape that 161/49C is theoretically relatively resistant to drought, a view which may very well be changing. Whereas discussions with vignerons a few years ago were based around the assumption that this rootstock which had been so good was suddenly failing, as if it had run out of energy entirely or else the mother plant had contracted some sort of disease, the view most commonly heard is that this rootstock cannot manage the new hotter, drier conditions. In almost every cellar, a question about 161/49C yields a glum response. Yes, we are suffering. At first vignerons pulled out damaged vines and replaced them individually, but when each following year the losses multiplied further, the bullet of ripping out the whole plot has to be bitten – demoralising, expensive and with repercussions for years to come. You need to leave the plot fallow for at least two years (wise old heads say five to seven years) before replanting. The first mini-crop arrives three years later and the vine does not really reach maturity for 20 years. Antoine Jobard is pulling out a plot of Meursault Genevrières that he only planted in 2017. Cyrielle Rousseau adds an additional nuance: a plot of Clos de la Roche recently replanted with three separate clones, all on 161/49C rootstock is suffering much worse in relation to one of the three clones compared to the others. A further headache is that it is not clear what to plant instead. Among its close siblings – other Berlandieri x Riparia crosses – are 420A, 5BB and Teleki 5C which are all now being widely trialled in place of 161/49C: but the worry persists that these too may develop the same issues. Others are looking at 41B – quite widely used in Chablis – which dislikes drought but does not die of it according to Roger Saumaize (Pouilly-Fuissé), or 3309 which is tricky where there is a high active limestone content. François Lumpp in Givry has switched to 363 Montpellier though he noted pithily (and I have cleaned it up a bit!), “When you buy stuff that’s rubbish, you find out too late: whether it’s the cork, the barrel or the cuttings from the nursery.” Solutions will be found: a rootstock that can cope with drought, doesn’t mind a bit of limestone, is later rather than earlier ripening, and allows the vine to deliver fine quality grapes. Auditions are being held now! One thing is sure – smart producers are going to hedge their bets by settling on a mix of different options, to avoid having all their grapes in one basket. The 2019 vintage in Montalcino has been hotly anticipated – following on from two trickier years, 2017 and 2018 (although we found the latter to offer some very elegant wines), it’s a year that seemed set to receive critical acclaim to match the lauded 2016.  A wet winter replenished water reserves, with a damp spring and warm, dry summer. There were no serious extremes in the conditions, with rain showers arriving in September allowing for a harvest of juicy berries, with little disease pressure, from the middle of the month, finishing in early October. It delivered both quality and quantity, and from what we’ve tasted the wines are extremely impressive – combining power and elegance, offering approachable yet clearly age-worthy styles with effortless balance.  Vinous – Antonio Galloni  For Antonio Galloni, one of the defining features of the 2019 vintage is its consistency: “The entire region excelled, from southwest to east and northeast to west. Frankly stated, finding a 2019 that doesn’t show remarkable balance, vivid fruit and freshness is a difficult task,” he writes.   The stress-free growing season produced wines of “utter harmony”, “a blending of power and elegance in a way seldom seen”. He explains that many producers describe the wines as “crunchy”, something he feels is apt, and compares the wines to the 2016s, but with more energy and the aforementioned crunchy tannins. “This is a vintage of radiance and appeal,” he says of 2019, a vintage with wines that are aromatically expressive, offer sense of place and typicity – often earning descriptors such as “classic, racy, cool-toned, crunchy and sleek”, as well as being built for the cellar (maturing over the next 10-15 years or more). It is, he writes, “the vintage we’ve all been waiting for”.  He emphasises that it isn’t just the 2019s that are so enticing, but that the “high-energy and fruit-forward” 2021 Rossos that make for “an embarrassment of riches” with the current releases. The 2021 Rossos offer “charming, wildly aromatic, drink-me-now personalities” – and are, he says “an excellent choice for collectors”, he suggests, providing “open drinking windows and gobs of pleasure” while the 2019s mature in the cellar.  Antonio Galloni’s top 2019s: Canalicchio di Sopra Vigna La Casaccia, Il Marroneto Madonna delle Grazie, Le Potazzine, Pian dell’Orino Bassolino di Sopra, Valdicava Vigna Montosoli, Mastrojanni Vigna Schiena d’Asino, Canalicchio di Sopra Vigna Montosoli, Baricci, Le Ragnaie Casanovina Montosoli, Argiano Vigna del Suolo, Altesino Vigna Montosoli  Explore Antonio Galloni’s full report, notes and scores on Vinous (subscribers only)   Wine Advocate – Monica Larner  “Now is the time to take a closer look at this storied Tuscan appellation,” advises Monica Larner – who is clearly excited by the quality of the 2019 vintage in Montalcino.   For Larner, 2019 offers “good balance between acidity, concentration and tannins” – with the latter more elegant than those of the 2018s. The wines are concentrated and weighty, yet balanced and elegant, and therefore remind her of 2007 or 2015. As other critics note, the wines are likely to be approachable in youth yet have the acidity and structure to age. The season was “uniformly easy” in both the vineyard and winery, and she highlights the large number of wines scoring between 97 and 99 points.  While both Kerin O’Keefe and Antonio Galloni feel 2019 has the edge on 2016, Larner believes that “2016 remains superior in my view in terms of elegance and longevity”, although 2019 “ranks close”. For her, one of the reasons the vintage feels so significant is that it marks the beginning of what she perceives as a “new wave” for Montalcino, with a group of producers pushing quality forward, inspired by Burgundy and Barolo to make wines with “vibrant flavors, light and energy”.  Monica Larner’s top 2019s: Le Ragnaie V. She was the Italian Editor for Wine Enthusiast for almost a decade, before she set up her own platform, however she is perhaps best known for her most recent book, Barolo and Barbaresco: The King and Queen of Italian Wine, and also wrote a book on Brunello di Montalcino in 2012.  For O’Keefe, the 2019 vintage is clearly an excellent year for Montalcino. “I’ve never tasted so many drop-dead-gorgeous young Brunellos from a single vintage,” she writes. It “has definitely lived up to its lofty reputation” and “the 2019s are overall even better than the 2016s”, she says. The wines combine “intensity, exuberance and great fruit as well as balance”, with many estates making their best wines ever. The growing season was “ideal”, and most 2019s offer “vital energy and refined tannins that allow the wines to showcase their [terroir]”.  Of course, while “it’s hard to find any defects with the 2019s”, there are of course some “more densely concentrated wines with generous alcohol levels”. Most, however, are “incredibly fragrant”, “full-bodied”, with “great energy” and “taut but refined tannins”, with the best combining body and finesse. She anticipates the wines ageing beautifully over the next 20 or so years.  Kerin O’Keefe’s top 2019s: Conti Constanti, L’Aietta, Le Chiuse, Ciacci Piccolomini d’Aragona Pianrosso, Gianni Brunelli, Canalicchio di Sopra, Gorelli, La Gerla, Lisini, Mastrojanni Vigna Loreto, Podere Le Ripi Cielo d’Ulisse, Salicutti Sorgente, Talenti Piero, Ciacci Piccolomini d’Aragona  Explore Kerin O’Keefe’s full report, notes and scores on her site (subscribers only)  jancisrobinson.com – Walter Speller  The comparison between 2016 and 2019 continues in Walter Speller’s report and he highlights how divided producers are on which is better. All agree, however, that 2019 provided a growing season without extremes – something “which has become the definition of a great year”.  He draws comparisons between 2004 (which offered quantity and quality), as well as 2015. “I’m not entirely convinced 2019 has the same pedigree as 2016,” Speller writes. While there are some outstanding wines, he feels there are wines with stubborn tannins – and he doesn’t find it as consistent as other critics, but rather confirms that the best producers make fantastic wines year in, year out. V., Sesti, Fuligni  Explore Walter Speller’s full report, notes and scores on jancisrobinson.com (subscribers only)   James Suckling  James Suckling remarks that, as a growing season, 2019 was “a throwback to the late 1990s”, echoing other critics in saying that producers found it an easy year with no major challenges in the vineyard and winery. “I loved them,” he writes of the wines, enjoying a “crunchy and pure fruit character” in many. His two 100-point wines (Casanova di Neri Giovanni Neri and Valdicava Vigna Montosoli) have “incredible clarity of fruit and fine tannins as well as a transparency that takes them to their unique soils and locations on the hillsides surrounding Montalcino”.  Suckling also highlights how there is decreasing emphasis on new barriques, with old oak and larger casks increasingly favoured by producers in the region, as well as a growing number of single-site wines.  While he notes that producers compare the year to 2010, 2015 and 2016 (or some combination of those years), for him they are closest to 2004, 1997 or 1998 – having a “neoclassical character” thanks to their “agility and harmony”, and recommends giving them three to five years in bottle “to come into their own”. She reports that 2019 wines are “exceptional and offer consistent greatness across the region”. She compares the wines to those of 2015 for their depth and concentration, 2016 for the vibrancy and tension, and 2010, saying that they offer “outstanding freshness, incredible balance of richness, and a great deal of complexity”. No matter your tastes, there is, she says “something for everyone regardless of style”. The easy growing season, with no major heat spikes or challenges, has resulted in a vintage that is defined by its “completeness” and advises “collectors are going to want to snatch up top bottles from across the region”. She highlights Poggio di Sotto and Il Marroneto Madonna delle Grazie in particular, identifying them as two, contrasting wines that “highlight the incredible potential of this vintage”. Old, low-yielding vines. I’ve written that phrase more times than I’d like to confess. But how much does it really mean when it comes to the quality of the wine in your glass? The 2023 vintage in Burgundy (read our full vintage report here) produced generous yields. In farming terms, that’s a good thing: a plentiful crop that restocks the cellars (and coffers). But the sheer volume of fruit (“a wall of grapes”, as Bouchard’s winemaker Frédéric Weber told us) posed its own challenge – and much of our time in the region’s cellars this year was spent diving into how they managed, or controlled, the yield. It seemed fitting, therefore, to address the topic in greater detail.  In the Old World, appellation rules will limit yields, with the yield generally decreasing as you move up the appellation system (see below a table detailing the maximum yields for Burgundy, for example). Of course, this indicates a relationship between yield and quality, implying less is better – and there is no doubt that excessive yields don’t produce fine wine. But how low is too low? There is a fashion for prizing vines that barely manage to ripen a bunch or two, but do they really make better wine than those producing a decent crop? Beyond our obsession with rarity, what are the consequences of less fruit per vine – and therefore, what does more entail? A note on measuring yield Before we get into the weeds of the matter, let’s address how we talk about yield. In the Old World, the most common measurement of yield is hectolitres per hectare (hl/ha), measuring the volume of juice or wine per hectare of vineyard area. In Champagne the standard measure is kilos per hectare and in Italy you may see reference to quintales per hectare (qt/ha or q/ha, with one quintal translating to 100kg), while in the US, producers are more likely to use tons per acre. We’ll dive further into the many variables here, but it’s worth highlighting that vine density isn’t taken into account by any of these measurements. Although a higher number of vines per hectare will generally mean a higher yield across the vineyard, the increased competition will also likely reduce the yield per vine. For this article, we have spoken to producers from a range of regions, but do note that yields are not comparable between varieties or region. Climate – with heat, sunlight and water availability, as well as the varying size of berries and clusters of any given variety, mean that there is no number that can be deemed a global average when it comes to yield. (Do look at this table compiled by the Wine Advocate’s William Kelley, comparing vine density, cluster weight and juice yields for various classic fine wine regions, to give you an idea of the differences between regions.) Given this, “high” and “low” yields aren’t equated to specific numbers here, but the concept discussed more broadly – and arguably more relevantly for those of us drinking wine rather than making it. Bearing all of this in mind, extremely approximate conversions can be made as follows: one tonne per hectare is approximately 7hl/ha, while one ton per acre is around 17.5hl/ha (Oxford Companion to Wine). Yields: how low is too low? “It’s not extreme mythology: low yields produce better quality,” Cerbaiona’s Matthew Fioretti tells me; for him, high yields risk dilution and sanitary problems – and at excessive levels, that is certainly true. But, as Myriad’s Mike Smith told me, the relationship is “not linear”. Mike Dunn (Dunn Vineyards) generally has low yields, but that’s not necessarily about concentration, he explains: it’s simply about how much they can ripen before winter hits. Up on Napa’s Howell Mountain, their poor soils and farming (avoiding irrigation and fertilisation where they can) naturally produce lower yields. He recently changed some of their Cabernet Sauvignon to cane (rather than cordon) pruning and, although they’re getting more fruit off the same vines, there’s been no loss in quality. “It’s all relative,” says Ivan Massonnat at Belargus in Anjou. He points to Saumur with its limestone soils, where producers can crop 45-50hl/ha without a problem, but on the schist soils that lie beneath his vineyards: “Forget about doing much more than 30-35hl/ha,” he says. And even that has proven challenging for him. In the seven vintages he’s produced at the estate, only two have come close to 30hl/ha, with the average around 15hl/ha, simply due to the challenges of each vintage. He’d have loved to crop more – but nature had other ideas, and vignerons have to adapt to the vintage. Massonnat explains how if you farm to produce yields that are overly low, you can end up with fruit that has high technical, or sugar, maturity, but isn’t yet phenolically ripe – leading to unbalanced wines. Smith echoes this, talking specifically about Beckstoffer Dr Crane, one of Napa’s legendary vineyards, which he finds likes to produce more – around five tons an acre (versus four in most of the vineyards he works with). He sees producers cropping to just three tons per acre there, and in warm vintages the fruit ripens too quickly for the phenolics to catch up. Philippe Bascaules – who was first appointed Estate Director at Ch. Margaux in 1990 – offers an interesting perspective, arguing that there’s no direct relationship between yield and quality. In Bordeaux in the 1970s, he tells me, yields were consistently low – 25-30hl/ha, with wines that were inconsistent. As the wines became more popular, with demand from the US in particular for the 1982 vintage, producers started aiming for significantly higher yields and chaptalizing much more. Soon, average yields had doubled to 50-60hl/ha – a level that was unsustainable, especially in challenging vintages such as 1992, ’93 and ’94. Gradually they implemented changes, introducing green-harvesting (in 1986 at Ch. Margaux) and reducing fertilisation levels in the 1990s. Today, he and his team aim for around 45hl/ha, “a good production” in his mind – but a level which also offers insurance against inclement conditions. Lowering yields is something that, for him, has brought greater consistency to both the estate and region across vintages – ensuring they can ripen the crop each year. Deliberately reducing the yield beyond this, however, wouldn’t offer any serious benefit, he says. Similarly, across the Durantou family’s estates on the Right Bank, including Ch. l’Eglise-Clinet, Noëmie Durantou Reilhac targets a yield of circa 42hl/ha. “The vine wants to produce fruit,” she says, “so if the yield is really, really low, something went wrong.” For her, it’s the balance that matters most. With very high yields, the resulting wines will lack concentration (“You cannot make in tanks what nature hasn’t done before,” she says), but equally if the berries are so small that there is barely any juice, you’ll have little but tannins left to work with. And, while hail or frost will reduce your yield, they won’t result in greater concentration. “I think it just comes down to stress,” Dunn tells me. And that’s a common thread for several producers, arguing that vines need to struggle to produce quality. As Sébastien le Golvet – of Champagne Henri Giraud, who works with the poor soils of Aÿ – says, “genii are born of suffering”. Suffering doesn’t always mean lower yields, however: arguably, Dunn says, in high-vigour sites, keeping higher yields will help increase stress, pushing the vine to work harder – and therefore produce higher quality. Elements impacting yield While it’s impossible for us to address every factor that influences yield, it’s worth – relatively briefly – highlighting a few additional influences beyond site (with poorer or richer soils), variety and vintage: Trellising: Trellising – the shape in which a vine is trained – can be used to control yield. At Cerbaiona, Fioretti emphasises how using alberello or bush vines is key to helping contain Sangiovese’s natural vigour. At Tiberio, Cristiana Tiberio’s oldest vines are pergola-trained, with a traditional Abruzzese system that encourages competition but also increases the canopy to aid photosynthesis and ripening. Vine material/rootstock: The material used in a vineyard is integral (as with Quinta do Noval’s Nacional vineyard, see below). Mike Dunn, for example, mentioned how one of his older vineyards was planted on St George rootstock, known for shatter and therefore limiting yields even further. Jean-Marie Fourrier (Domaine Fourrier) argues that the use of selected clones, rather than massal selection, has resulted in higher yields and the need to green harvest, something that he never does – aided further by the age of his vines (see below for more on this). Vine age: There’s no doubt that the element of vine age is conflated with yields and quality, with older vines often producing better fruit – but less of it. As Mike Dunn told me, the wines from his oldest vines are “more intriguing”, but at some point economics comes into play, and the level of production is financially unsustainable. It’s another non-linear relationship, however, as Durantou Reilhac explains: “Some 70-year-old grandmas can run and dance, and others are weaker.” Although most old vines will produce less fruit, she finds it’s far from uniform in her vineyards – and sometimes there will be young vines that produce less. Virus and millerandage: Virused vines will produce lower yields, and as with old vines, will reach a point where they are unsustainable. While on the surface virus is negative, certain producers do value the reduction in yield or slower ripening that is a result of disease – South Africa’s Hamilton Russell being one (with leafroll virus). Quinta do Noval persists with its own-rooted Nacional vineyard, suffering from phylloxera, with the vines slowly dying and yielding tiny volumes, to produce a particularly special and rare Vintage Port. Similarly, millerandage is a condition most commonly a consequence of poor weather at fruit-set, producing grape clusters with unevenly sized grapes, combining larger and smaller (or shot) berries – sometimes referenced as hen-and-chick. While this reduces yield, the phenomenon is sometimes valued for giving increased concentration to wine. Indeed, some particular clones – such as the Mendoza, Wente or Gingin clones of Chardonnay – are valued for their bunches with hen-and-chicks, and Bret Brothers, for example, even makes a special Cuvée Millerandée – with millerandée Chardonnay – from Les Quarts (a Pouilly-Vinzelles site recently awarded Premier Cru status). Cover crops: At Henri Giraud, Sébastien le Golvet feels that cover crops are essential to the quality of their fruit – and the yield. Sewn just before harvest, the cover crops provide competition up until flowering when they roll the grass mix, creating a bed that holds water and offers nitrogen to the soils, acting as a natural fertiliser – in a way both moderating then fuelling the vines’ growth. This is one hint at the extent to which the type of soils and level of organic matter, not to mention water availability, dictated by site and the farming methods, are all key. The previous vintage: There are two theories at play here. Firstly, conditions during what is known as the initiation phase of the vine cycle, which takes place alongside flowering, will dictate the yield of the following vintage. In 2023 in Burgundy for example, one of the factors in yield was that the spring of 2022 offered perfect conditions, laying the groundwork for 2023’s plentiful crop. As Sébastien le Golvet also explained, however, a large crop in one vintage can tire the vines, meaning they have less to give the following year. How wine producers manage yield The vine naturally wants to reproduce, to grow, ripen fruit and spread its seeds. Vignerons are tasked with taming the plant to focus its energies to develop fruit of concentration and complexity that will make fine wine. This is done in many ways, some of which include: Pruning: The first stage to set up the yield in an existing vineyard is pruning, leaving the appropriate number of buds per vine for the season ahead. The timing of this varies according to the producer, from December through to March, with later pruning helping delay the vine cycle, which is sometimes desirable. Alvina Pernot, for example, specifically pruned her vines shortly (ie to offer a lower crop) in 2023 to help the vines recover from the relatively high-yielding 2022 vintage. Lalou Bize-Leroy famously works with very low yields, and emphasises how important pruning is in this (Domaine Leroy harvested just under 30hl/ha in 2023, its highest ever yield – a number which would still be low by many producers’ standards). De-budding or suckering: In spring, producers will de-bud or sucker the vines, removing lateral shoots and providing further control of the potential yield, as well as the spacing and position of the crop. In 2023 in Burgundy, many producers emphasised how important this was. Hugues Pavelot described it as “drastic”, while Philippe Jouan passed through his vines twice. At Bouchard, Frédéric Weber explained how some of the buds produced two or three bunches in 2023 (rather than the normal one), meaning that even with extensive de-budding yields were very high. Green harvesting: Green-harvesting is the most discussed method of yield control, and one that divides producers. We spoke to several Burgundian vignerons who avoid it (Dominique Lafon, Jacques Devauges at Domaine des Lambrays, Philippe Jouan and Jean-Marie Fourrier, to name a few) – some of whom felt that they had no choice but to use the method in 2023, despite their best efforts. The reason against green-harvesting is that the vine will try to compensate, and that it can be avoided with managing the vineyard in other ways. That said, there are many top-tier producers that green-harvest, and feel it is key to the quality they produce (Ch. Margaux, Eglise-Clinet, Georges Noëllat and Olivier Bernstein, to name a few). And it’s not a decision that any take lightly, well aware that they are literally throwing away potential income. At Cerbaiona, Fioretti compares the vines to runners or cyclists – needing to carry as little weight as possible to get over the finish line. With Sangiovese, he finds it’s unavoidable, especially with the presence of “wings” or “shoulders” (smaller separate clusters that sit on the shoulder of the main bunch). The timing is key, and many producers emphasise the importance of green-harvesting early in the season. For Noëmie Durantou Reilhac, she aims to have this done prior to véraison to avoid twisting the stems (which would impact sap flow) and damaging the skins of the remaining bunches. She’ll do a final pass through her vineyards just before harvest, but this is a method of sorting rather than impacting the ripeness of the grapes on the vine. “There’s a certain point where you can reduce fruit, say a month away from picking, but it won’t do anything,” says Myriad’s Mike Smith. Like many producers, he favours green-harvesting mid-véraison to drop anything that is behind, helping even the ripeness of the crop – as Bascaules does at Ch. Margaux. In 2023, several Burgundy producers highlighted having to do multiple passes to reduce the crop – doing what was sometimes referred to as a “pink” or “blue” harvest on top of a green harvest. Canopy management: A vine’s leaves are its engine – responsible for photosynthesis. The larger the canopy, the larger the engine, therefore trimming the vine’s canopy can help lower its vigour, while keeping a larger leaf area can help encourage vigour. This needs to be considered alongside airflow (to avoid disease pressure) and shading of the bunches (which could delay ripening). If the canopy isn’t balanced with the volume of fruit, it can also negatively impact fruit composition – especially the acid make-up and development of colour and phenolics. Ivan Massonnat (Belargus) explained that in 2022 and 2023, for example, he used a high trellis, allowing a larger leaf area, to capture maximum light and photosynthesis to fuel the vines; but in 2022 he did the opposite, wanting to reduce the size of the “sugar machine”. It has, he notes, become common for large canopies to be used alongside low yields, especially by producers in Burgundy, something he feels has gone too far at certain addresses: “You can kill a wine with concentration,” he says. Some argue that trimming the canopy can encourage it to grow further, while others want to retain a large canopy to encourage root growth (Olivier Lamy feels that the vine has the same amount of growth above and below ground, therefore wanting to retain his canopy to the roots to drive deep into the soil). Lamy is one of a cohort of producers using “tressage”, or braiding, to tame the canopy – a technique pioneered by Lalou Bize-Leroy. For her the aim is to avoid cutting the apex (or growing tip) which would otherwise encourage the growth of lateral shoots. Producers such as Charles Lachaux have taken this even further, training vines to a single stake (more common on the steep slopes of Priorat, Côte-Rôtie or the Mosel) and weaving the shoots into distinctive arches.  The relationship between yield and quality is undoubtedly a tricky one – and one that every producer I spoke to feels is deeply complex. We couldn’t touch on everything here (the tiny yields for botrytised sweet wines, for example, or typically higher yields used for sparkling wine), but there’s plenty to consider. While it remains clear that excessive yields can produce dilute wines, with so many variables play, it’s also clear that less isn’t always better. Read more Editorial
