In some parts of the wine industry, oak has almost become a dirty word. Many winemakers eschew its use, seeing it as something that homogenises varieties and styles with its overbearance, given its potential to dominate a wine’s final flavour. The use of new barriques in particularly has become less and less popular in varieties that are more prone to oxidation and whose delicate aromatic nature is lost to the perfume and spice of toasted oak. This certainly seems to be the case for the Italian varieties Sangiovese and Nebbiolo, for which there is a decided swing back towards more traditional, larger, old oak vessels that do not impart oak flavour to the wine.  Although Burgundy’s Pinot Noir and Chardonnay have a great affinity to new oak, its use is declining significantly. Today in the world of fine wine, terroir is the trumping card and if new oak is a barrier, then its use starts to be questioned – but the Bordelais have long been strong affiliates to long ageing in barrique and the additional complexity that this brings wine.   Amongst Bordeaux’s elite, there remains a strong endorsement for the continued dominance of oak. Hugely influential producers such as Ch. Margaux have no qualms about using 100% new oak. Winemaker Philippe Bascaules believes criticisms of overusing new oak are due to “the weakness of the wine” – rather than the power of the oak. For Bascaules, “The most important quality it brings is the evolution of the tannins,” – and this is something he is not willing to give up. After many years of experimentation, Ch. Palmer's Thomas Duroux (another of the region’s leading names) also believes the oak barrique is the vessel that best develops the tannin structure of a wine. For him, the 225-litre barrique provides the perfect ratio of wine to wood and level of oxygen exchange for “building the wine”, and thus creating more structural complexity. But for some vignerons, new oak does has its limits. Duroux himself is well aware of new oak’s ability to overpower other flavours and he tries to maximise structure, while not losing the primary fruit character and aromatic complexity of the wine during oak ageing. He has come to his own conclusion that the best approach is to age the wine in two phases.  From November to July, he ages the wine in 225-litre barriques (either new or one-year old oak). Then from the July after harvest to the following July, the wine is transferred to larger oak foudres (2,900-litre barrels). Duroux describes this second phase as, “the refining period, where the wine becomes more integrated, more delicate – without taking on oak flavour or oak tannin”. He started trialling this method in 2017 and now Palmer has 20 foudres in operation. For the 2020 vintage, 30% of the wine has been aged this way. Bruno Borie (Ducru-Beaucaillou), however, feels that the reason for using new rather than old oak is often misunderstood. It is not the flavour that is important, but the cleanliness of the vessel. With wines such as the reds of Bordeaux, where pH levels are fairly high, it only becomes more important, since the wines are prone to bacterial spoilage, something that plagued the region in the 1980s and ’90s.  “We don’t sell wood, we sell wine,” Borie says. “We just use new wood because it is clean and sterile.  Brett [Brettanomyces, which causes bacterial spoilage] is so dangerous.” Older barrels are difficult to clean effectively after use, agrees Margaux’s Bascaules, and when a barrel is beyond a year old, the risk of microbial spoilage simply becomes too high. For Duroux, the older barrels also develop a sulphate compound which can “dry out the wines”.   Oak flavours are undoubtedly integral to the flavour of Bordeaux – but even its strongest supporters are today more open to understanding and better controlling its effects. Although Bascaules has no plans to change how Margaux is made, he is excited to learn what the wine would taste like without oak.  Over many years working at the château, this is something he has never experienced and still does not know. He has plans to experiment with glass amphorae, the idea being that by knowing what Margaux tastes like without oak, it will help him better understand how different elements bring flavour to the wine. “Many flavours people assume are from oak are not,” he says. “Cabernet Sauvignon, for instance, can produce coffee-like flavours. Often it is the reaction of oak and fruit that creates the flavours together.” Using these new glass amphorae will bring a better understanding of Margaux’s DNA – or at least this is what he hopes. Borie also notes that long oak maturation is essential for extending the ageing potential of the wine, something alternative vessels simply cannot do. “We make wine for collectors, wines that can be cellared for decades. Bordeaux’s ageing potential is very important, it is one of its signatures,” he says. Since 2003, Borie has extended the time Ducru-Beaucaillou spends in oak from 12 to 18 months to further extend the wine’s 
longevity. “Longer maturation in oak brings a special textural complexity, a different level of integration – a melding of tannins,” he explains.  But there are others in Bordeaux committed to oak alternatives. One of the region’s top châteaux that has made a significant switch from oak is Ch. Pontet-Canet, which has been ageing 35% of its wines in concrete amphorae since 2012. For Pontet-Canet’s Justine Tesseron, “Too much oak hides too much of the fruit flavour.” The clay amphorae, she feels, “help to keep the freshness of the fruit and keep the purity of the wine”. Happy with the results, Tesseron is considering increasing its proportion in the future, convinced they aid them in retaining “a pure expression of what the terroir is giving us”.  But no one in Bordeaux is giving up on the oak barrel altogether. In fact, the strongest advocates of alternative vessels tend to think a combination of both is where you can achieve the most complexity. Guillaume Pouthier from Ch. les Carmes Haut-Brion is known as one of the more experimental vignerons in Bordeaux and was amongst the first to introduce clay and glass amphorae as an alternative to oak. He feels clay in particular is “very interesting” as it allows the same oxygenation as barrels but you keep the “freshness, you keep the first aromatics of the wine”. He has some 2018 still in clay amphora and it smells like it was just picked.   Ageing wine in glass containers, however, sees no exchange with oxygen, meaning “the tannins don’t evolve” and the resulting wine is “very pure”, something which he feels adds energy to a blend although can risk making the wine “too hard” if there’s too much. For Pouthier, small proportions of wine aged in clay or glass brings additional complexity to the wine, working in combination with oak-aged wine.   Despite these tentative steps into alternative vessels, some have been less than impressed with their experiments. Bruno Borie comically uses history as his guiding light: “Amphorae were used prior to the Romans. But the Romans introduced oak because they saw it as an improvement – they chose the gods of the forest. Being ancestors of the Romans, we should do the same.”  For the top growers in Bordeaux, such as Ch. Lafite, oak still remains an incredibly important element in their wine. With their own cooperage on site, they produce 90% of the oak they use each year, with the Grand Vin typically seeing 90% new wood. Lafite’s Jean-Sébastien Philippe believes that in addition to building volume in the wine, oak also adds important “aromatic and flavour complexity”. These additional layers of flavour are down to the skills of the cooper and, for him, are something that should be celebrated. “Light and delicate toasting – not vanilla or coconut – but toasted spice adds complexity to the wine,” he says. While Cabernet Sauvignon clearly has a great affinity to the barrique, Cabernet Franc and Merlot seem to have better results with larger oak foudres and amphorae. Nicolas Glumineau at Ch. Pichon Lalande is going to start trials with glass and concrete, having been really impressed by wines, in particular, aged in glass. “The more structured the wine, the better it is in terms of definition and tannic structure. I was impressed with the results with Merlot, but the Cab Franc was stunning,” he said.   Pomerol’s Ch. l‘Evangile is experimenting with ceramic jars, which they believe not only “preserves intensity, purity and freshness of the fruit, but causes a vortex [within the vessel] constantly moving the wine around, resulting in more contact with the lees, that brings a more rounded, silky texture to the wine” .  While their influence remains minor in the final assemblage, these new amphora advocates are convinced that their judicious use adds complexity to their wine – and oak alternatives look set to become a permanent fixture for many in Bordeaux. For châteaux, like L’Evangile, these experiments are happening in conjunction with a reduction in the percentage of new oak in recent years (from 80% to 50% for L’Evangile) and they are not alone.  Overall, despite the healthy levels of experimentation going on in the region, oak barriques still reign supreme in Bordeaux. In their trials with alternative vessels, many vignerons have fallen back in love with the unique properties of the oak barrique. While cement, clay and glass, as well as larger oak, will continue to play a minor role at some properties, it’s unlikely that the barrel will fall from favour anytime soon.  Read more about oak in Finding the balance: the art of the cooper or explore Bordeaux

Is Bordeaux over oak?

Vega Sicilia is undoubtedly Spain’s most famous winery; a true icon in fine wine with a history dating back to 1864. Its success in retaining such a reputation, and in almost complete isolation in the Ribera del Duero region of Spain, is testament to the quality and consistency of its production, although its history has not been without its challenges. Vega Sicilia claims to be one of the longest-aged and longest-lived red wines in the world, with its flagship Unico capable of maturing in bottle for well over sixty years under the right cellar conditions. Developing its style in such solitary conditions has created a wine distinct from any other and whilst the Ribera region has flourished with the establishment of wineries such as La Pesquera in the 1970s and more recently the cult wine of Pingus, Vega Sicilia today remains at the apex of the appellation.  We explore the history of Vega Sicilia, the secrets behind its success and the changes afoot as it attempts to retain the traditional methods it has become famous for whilst modernising the winery and updating its processes. We also explore the contrasting range of wines it produces from the Valbuena to the Unico Reserva Especial: Vega Sicilia’s nod to the traditional Spanish practice of producing multi-vintage premium blends. The history of the estate The estate that would become known as Vega Sicilia was founded in 1864 by Don Eloy Lecanda Y Chaves, a Spanish vigneron who inherited the property in 1859. After visiting Bordeaux he brought cuttings of the Bordeaux varietals of Cabernet Sauvignon, Merlot, Malbec and Carmenere, as well as Pinot Noir, and planted 18,000 vines at the estate in Ribera del Duero alongside the native varietal of Tinto Fino (Tempranillo). By 1882 he had planted 500,000 vines on the estate, at the time known as Bodegas Lecanda.  The introduction of Bordeaux varieties was perhaps not that unusual at the time, since the Bordelais were becoming more and more influential in Spain (most notably in Rioja) having disbanded their operations in Bordeaux following the phylloxera outbreak and were actively looking for alternative regions to grow their grapes.  However, in Rioja, the Bordeaux varieties were soon replaced by the native Tempranillo which proved a much more reliable and profitable choice. Whilst Don Eloy Lecanda Y Chaves initiated a winery that was to change the history of fine wine, he was initially using the grapes to make brandy rather than still wine. Although the brandy was well received amongst the aristocratic families (no doubt piquing the interest of the Herrero brothers), the estate struggled financially to make ends meet and he died in 1894 never to witness the success of his venture.  The property was bought by the Herrero brothers in the early 1900s who renamed it Vega Sicilia. As phylloxera eventually reached Rioja, the négociant Cosme Palacio was looking further afield to maintain supply for his customers. On discovering Vega Sicilia, he immediately rented the property from the Herrero brothers.  He brought with him winemaker Domingo Garramiola Txomin who introduced the Bordeaux techniques of ageing wine in barrique as well as extending the élevage. He also initiated bottling the wine on the estate (Cosme Palacio was previously shipping the wines in bulk to Rioja).  The Herrero Brothers were a well-connected upper-class family who were galvanised to produce a wine of exceptional quality no matter the cost, to sell to their aristocratic friends. This quest for quality combined with the skills of Domingo Garramiola Txomin, as well as the unique combination of Bordeaux varieties and Tinto Fino (thanks to Don Eloy Lacanda Y Chaves), was the perfect recipe for producing Spain’s first iconic wine – Vega Sicilia Unico. The first vintage of Unico was produced in 1915.  Thanks to the connections of the Herrero brothers, within two decades Vega Sicilia had become the most revered winery in Spain. Even at this time the wine had built up a reputation for its extraordinary ageing capacity. At Vega Sicilia the Bordeaux varieties became a key component to their flagship wine of Unico and have remained in the blend right through to the present day. Throughout this time, the property became almost a self-contained village, with a school and chapel on site and many of the families working at the winery and living on the estate. Despite the winery changing hands a number of times over the last century, Garramiola’s legacy has lived on through the winemakers that followed in his footsteps; figures like Martiniano Renedo, who was initially Garramiolo’s assistant, and especially Jesús Anadón, who was instrumental in maintaining the quality and reputation of the wine through the middle of the 20th century.  Amazingly there are workers on the estate today whose families have worked at the winery for generations. Today the master cooper at Vega Sicilia, along with his brother Jesus Yanez, is the fourth generation of his family to work at the property. The winemaker between 1968 and 1998, Mariano Garcia, was the son of one of the farm workers on the property.  Despite its global reputation, its exclusive allocation list and long history, the winery and vineyards went through bouts of dilapidation during the 1950s, through to the late '70s, whilst at the same time producing some of the most legendary vintages. On purchasing the property in 1982 the Álvarez family began to make huge investments into the estate, renovating the winery and carrying out an extensive replanting program in the vineyards. 1982 was also the year Ribera del Duero was awarded its DO appellation status and no doubt helped further promote Vega Sicilia as the historical icon of the region. The winery and the appellation has never looked back since.  In the vineyard Vega Sicilia is situated on what is known as the “golden mile”, a stretch of road between Pañafiel and Tudela de Duero, where the prestigious wineries of Vega Sicilia, Pingus and Pesquera are all situated. Driving through, it is a somewhat underwhelming sight as far as vineyard vistas go, so much so you could almost pass through it without noticing.  Being an altiplano there are no sweeping mountainous views, you only feel the altitude from the freshness of the air. In the higher vineyards of Soria at the edge of the Ribera appellation you are rewarded with more vistas, as well as a sense of history with evidence of prehistoric cave-like dwellings where farmers sheltered from the extreme climatic conditions of this largely desolate region.
 Whilst there are pre-phylloxera ungrafted vines dating back over 100 years dotted around the region, the vines at Vega Sicilia - with vineyards at 700 meters - average around 35 years of age. Vega Sicilia have an extensive replanting scheme in their vineyards preferring the quality of their fruit in their mid-life as opposed to old age, with typical vine age in Unico around 60-65 years old, with the younger vines going into the Valbuena cuvée. The high altitude and continental climate mean extreme conditions are at work in the vineyards. Winters can be very cold whereas the summers can be fierce. Most notably in regards to grape growing, due to the altitude, there is a huge diurnal shift in temperatures from day to night helping to retain the acidity and freshness in the grapes whilst reaching high levels of ripeness. The main grape in all Vega Sicila wines remains the Tinto Fino (the particular clone of Tempranillo) distinct to the region. The Tinto Fino is said to produce smaller berries with higher concentration of tannins compared with the Tempranillo grown in Rioja. The Unico also has a proportion of Cabernet Sauvignon in the blend (anything from 6-20% in more recent releases) with a higher proportion in older vintages. In the Valbuena, the majority of the blend is Tinta Fino with a small amount of Merlot (typically 5%) . The property is huge in scale with 200 hectares of estate-owned vines producing anything from 40,000 to 100,000 bottles of Unico each year depending on the vintage.

 Unico  The style of the flagship cuvée of the winery has remained virtually unchanged since its inception in terms of production, although assemblage has modernised. Élevage times have reduced and the influence and proportion of Bordeaux varieties has become less in more recent releases.  In the past, Unico was only made using huge 40,000-litre fermentation tanks (this was all that was available at the winery) therefore in a difficult vintage, if this sort of volume was not possible at the quality level they expected, then no Unico would be released that year. Since 2010 the winery has introduced smaller 8,000-litre tanks, enabling smaller micro-vinification of their wines and suggesting a release of Unico every year (in varying quantities) is more likely. The winery today operates at a spec similar to the top estates in Bordeaux. They have introduced 81 separate fermentation tanks allowing them to carry out intra-plot fermentation. They have introduced highly sophisticated sorting tables, there is more temperature control of the wine and the winery is now completely gravity fed enabling greater precision when it comes to winemaking.   Following fermentation, the wines destined for Unico are blended in small oak barriques (50% French oak / 50% American oak) for 12-24 months depending on the vintage. The French oak is 100% new whilst the American oak, coopered on site, tends to be one to four years old. Following barrique ageing, the wine is then transferred to large old oak casks where it typically matures for five years before being bottled and aged further prior to release. Unico is typically released at 10 years old. Valbuena 5° The Valbuena typically comes from the younger vines of the estate and is aged in oak in barriques for 12-18 months before being transferred to larger old oak casks for a further 18 months prior to bottling. It is then aged for two years in bottle. Valbuena is typically released at five years old. Unico “Reserva Especial” The Reserva Especial is the mythical bottling that initiated the Vega Sicilia legend. It is made up of choice parcels from a blend of vintages (in recent releases it tends to be select parcels from three vintages). Prior to the 2001 release, details of the blends of older bottlings are not very easy to come by. With only 15,000 bottles produced this is the rarest cuvée from Vega

Vega Sicilia: a Spanish wine icon

Last year the Chianti Classico governing body of producers (the Consorzio) banned the use of international varieties in wines bearing the top Gran Selezione classification. The decision has caused an outcry among some of the region’s top producers. Many claim that Cabernet Sauvignon and Merlot were not only instrumental in raising the quality and consistency of the region but have since become an important part of the region’s identity today. Some producers claim that the Consorzio, in the name of authenticity, is limiting the vigneron’s creativity when instead they should be focusing on upholding quality. As far as appellations in Italy go, Chianti is one of the oldest, dating back to the early 1700s. Quality, even back then, was an important factor for the top producers. Castello di Ama discovered records from 1773 which showed their estate was exporting wines to England and producing wines with exclusively red grapes designed for ageing – something that became a rarity in the region during the 20th century.  With few exceptions, Chianti production up until the 1990s was focused on quantity. Vineyards were mixed, typically with three Sangiovese vines for every white vine, either Malvasia or Trebbiano. “The white grapes were part of the culture here”, says Castello di Ama’s Lorenza Sebasti. “The white and red grapes were made together, to make a wine for everyday – it was part of the meal and needed to be as light as possible. It was safer to drink than water. And it gave you energy.” Under the Chianti appellation, the wines had to include white varieties (Malvasia or Trebbiano) alongside Sangiovese.  With a focus on quantity, the quality of the Sangiovese clones planted at this time was generally poor. As such, Sangiovese struggled to reach full maturity, resulting in aggressive tannins – typically mellowed by the blending of white varieties. From a quality perspective, it was impossible to make a 100% Sangiovese wine of any quality. The 1970s marked the beginning of a fascinating creative and experimental winemaking period in Tuscany. Piero Antinori and Giacomo Tachis were instrumental in replanting programs focused on quality. New clones of Sangiovese would eventually help, but international varieties were an essential component in quickly raising the quality of the region’s wines, as well as their ageing potential – another important attribute of fine wine. As well as working in Bolgheri creating the first Super Tuscan with Sassicaia, Tachis and Antinori produced their first vintage of Tignanello from their top vineyard in Chianti Classico in 1971. This first vintage was made only from red grapes (Sangiovese and other local varieties) and matured in oak barriques (the first wine of the region to be made in such a way).  With mixed results, they went back to the drawing board. After much discussion, and no doubt buoyed by their results at Sassicaia, they believed Cabernet Sauvignon was the solution. It wasn’t until 1975 that they produced the next vintage of Tignanello, this time a blend of 80% Sangiovese and 20% Cabernet Sauvignon – a blend that has remained the same ever since. The addition of Cabernet Sauvignon and maturation in barriques meant it broke the appellation rules and had to be declassified to a table wine. But it was the quality of this wine that spurred a new generation of winemakers that was to reshape the Tuscan landscape. More and more quality-led producers in Chianti Classico started experimenting with different varieties. Lorenza Sebasti describes Castello di Ama at this time as a “workshop of experiments”.  “When we started introducing varieties from France, we did many experiments – Pinot Noir, Chardonnay, Cabernet Franc, Cabernet Sauvignon, Merlot, Sauvignon Blanc… Our greatest success turned out to be Merlot.” Although the Consorzio eventually caught up with these pioneering producers and allowed up to 20% international varieties to be included in Chianti Classico blends, wine made from 100% Sangiovese was still not permitted. As better, lower-yielding Sangiovese clones started to appear, other Chianti Classico producers such as Fontodi, Montevertine and San Giusto a Rentennano broke the rules and started to produce 100% Sangiovese wines – again forcing them to declassify them. It wasn’t until 1996 that the Consorzio allowed Chianti Classico to be made from 100% Sangiovese. For Stefano Carpaneto, Tignanello’s winemaker since 2002, the presence of Cabernet was absolutely fundamental in Tignanello’s success. In the early days, Sangiovese was still lacking consistency and suffered with aggressive tannins if not blended. “Sangiovese was also difficult to manage in vinification and during the élevage in barrels,” he says. For him, the introduction of Cabernet gave balance to the Sangiovese at vinification and provided a tannin structure that allows the wine to age. It also guaranteed consistency year after year, which was paramount if Tignanello was going to compete with other fine wines around the world. At Castello di Ama, Merlot not only became an essential component in their top single-vineyard Chianti Classico wines but was so good in its own right that they created L’Apparita – a 100% Merlot wine that today competes with the finest Merlots in the world. “Merlot in Tuscany has its own personality,” says Sebasti. “The aim was to make a very good Chianti Classico. But the Merlot stood out with its personality, we took it as a gift. It was part of our research, but it was also a discovery.” Sabasti explains how Tuscan Merlot is totally different to the Californian style, or Pomerol. “Somehow,” she says, “it has depth, but is not with fat and remains very vertical.” Tignanello, L’Apparita, Fontodi’s Flaccianello, Percarlo and Le Pergole Torte are some of the region's very top wines, responsible for raising its profile, yet all were forced at one time or another to declassify their wines. The Consorzio has caught up and now allows barrique ageing, 100% Sangiovese and the use of international varieties in Chianti Classico. But at a time when quality has never been higher, they have again been criticised for their recent decision to ban international varieties from the top Chianti Classico Gran Selezione classification. Castello di Ama’s Sebasti is not happy. She is a big believer in what she calls “renaissance thinking” – where quality-led winemaking should be about creativity and discovery, not rules. After all, it was the rulebreakers in Chianti Classico that brought quality to the region. Sebasti recalls how Robert Mondavi who, despite his position of power in Napa, stood up against imposing rules that would restrict young, up-and-coming winemakers to produce wines in a region where it was becoming too expensive to own land. Many other producers wanted to allow only bricks-and-mortar wineries to become members of Napa Valley Vintners, but Mondavi believed this would stifle creativity in the region. Sebasti echoes Mondavi, “We need the energy, the creativity, the new challenge of young winemakers and rulebreakers to continue to make our wines the best.”  Despite Antinori’s reputation largely being built on the success of international varieties, they are in favour of the banning of international varieties in Gran Selezione and voted for the change. “While the international varieties were absolutely necessary to transition the region from quantity to quality, they can now be put to one side,” says Carpaneto. For Carpaneto, the changing of the rules will help create a clearer identity for the region. He believes being able to taste 100% Sangiovese wines from different villages within Chianti Classico will help the critic and consumer compare the differences. “The international varieties can influence the wine too much,” he says. “A variety like Merlot can go over the terroir, it can cover the terroir.”  Sebasti, on the other hand, is yet to be convinced. She understands the allure of making Chianti Classico from 100% Sangiovese. She regularly tastes her own vats of Sangiovese and, while they can be great, for her, the magic touch for her terroir is a soupçon of Merlot added to the Sangiovese that makes her wine better – she is more interested in that than the classification. “They go for monotony,” claims Sebasti. “They say authenticity is 100% Sangiovese and this is historically incorrect […] It is not a political choice, it should be a vigneron’s choice.” If forced, Castello di Ama will leave the appellation.  While Antinori approved the decision for the ban, they have no intention to change the blend of Tignanello, or Solaia for that matter. “We cannot touch the Super Tuscans,” says Carpaneto. Their reputation is bigger than any classification. Regularly compared to the top wines of the world Carpeneto believes they have earned their place in history.  Among these top producers their wines do not need to rely on the classifications, however it is interesting that the top wines in Antinori’s portfolio, for example, are wines that rely on a blend of both Sangiovese and international varieties. In 2002 (a terrible vintage for Sangiovese), Solaia was made entirely from Cabernet Sauvignon. Carpeneto says they would never do this again. “the wine doesn’t taste like Solaia,” he says. “If we had the same vintage conditions again, we just wouldn’t make it.” As at Castello di Ama, it is the special relationship between the international variety and Sangiovese that makes their top wines so special.  Tuscany’s rapid rise in quality could not have happened with Sangiovese alone. It has the international varieties of Cabernet Sauvignon, Merlot and Syrah, at least in part, to thank for that. They were instrumental in Tuscany’s transition from an industrial-led wine-producing region to a qualitative one. The decision to ban their inclusion in the Gran Selezione classification will cause ruptures in the appellation – though the region is no stranger to controversy. Each vigneron will need to decide for themselves whether it compromises quality. Either way, the mavericks that have helped build Chianti’s reputation are not likely to let rules get in their way. Looking beyond Sangiovese: Chianti

The Langhe is unspeakably beautiful. You may have seen Allessandro Masnaghetti’s 3D maps – a painstaking project by this now-iconic cartographer to translate these terroirs to paper. Their textured surfaces speak of Barolo and Barbaresco’s complex geology – and yet they don’t fully convey its endless curves and corners, winding roads and intricate jigsaw of villages and vineyards, nestled in amongst each other. This is a landscape carved and sculpted by nature over 15 million years; the vines cling to precipitous slopes, sweeping down toward the valleys. Like the effortless lines of Michaelangelo’s marble, it’s a masterpiece.  We’ve just returned from a trip to Piedmont’s most prestigious vineyards, dipping a toe in the waters of this fascinating area over three days. With the layers of region, village (11 in Barolo, three in Barbaresco), its Crus (officially known as MGAs, Menzione Geografica Aggiuntiva) and individual vigne or vineyards, Barolo and Barbaresco are often compared to Burgundy. These layers of complexity and nuance are what wine-lovers thrive on, the detail that allows us to indulge new levels of geekery. Add to this the finesse and aromatic perfume of Nebbiolo, and it’s easy to see why Pinot Noir lovers fall for the region.   While wine has long been made in the Langhe (for at least 2,000 years), the first dry Barolo is thought to have been bottled in 1844, with wines before that often sweet or lightly sparkling. It’s only really in the 1960s that the region’s reputation started to be built. Wines were – as in Burgundy – mainly made by négociants until this point, when individual estates started making their own wine. Traditionally wines from across the region were blended to create an expression of Barolo as a whole, but this too started to change. Prunotto and Vietti were the first to identify and vinify individual plots in Barolo, following a trip to Burgundy in the 1950s and ’60s (read more about the birth of Barolo’s Crus here); while in Barbaresco, it was Angelo Gaja who started to make wine exclusively from vineyards the family owned (from 1961) and then bottled the single vineyard Sorì San Lorenzo separately for the first time in 1967.  Traditionally the wines were made with long maceration times (leaving the wine in contact with the skins for 50 or more days) and several years in large oak casks, to extract colour, tannin and flavour from the thin-skinned Nebbiolo. These wines were immensely age-worthy, but their rasping tannins often needed time to become approachable – in some cases the fruit would fade while waiting for the tannins to come round. Winemaking – as elsewhere – was rudimentary, and the late 20th century brought with it modern technology and better hygiene. But the 1980s also saw Barolo divided.  This was the period of Parker and Parkerization, with rich, voluptuous wines with sweet fruit and vanilla tones from new French oak all the rage. Barolo couldn’t be further from this style – and its winemakers were humble farmers, with little recognition (financial or otherwise) for their work. But then a group of producers, led by Elio Altare, embraced the barrique (the traditional 225-litre French oak barrel), looking to put Barolo and its wines on the world map. These modernists, sometimes known as the “Barolo boys”, used new oak, and shorter, more vigorous extractions to craft wines that were fruitier, darker and more immediate – and received instant acclaim. The traditionalists of the region, however, fiercely defended the Langhe’s historical ways, the use of long macerations and large, old botte casks. Bartolo Mascarello famously released a label stating “No Barrique, No Berlusconi” (adorning the 1998 and 1999 vintage), decrying the use of new oak and Berlusconi’s right-wing politics.   Modernisation was essential – and better hygiene, with the arrival of stainless steel, was revolutionary. Today, as more and more producers around the world turn to large oak casks, it’s unsurprising that many in Barolo and Barbaresco are returning to their botti, and new oak has generally fallen from favour (at least in high proportions), yet the barrel certainly lives on, even if still controversial.  “Barrique… it’s an ugly word here in the Langhe,” says Dave Fletcher, the Australian producer who left the Yarra to make wine in Piedmont over a decade ago (under Fletcher Wines and Cantina della Stazione). He avoids new wood, but prefers barrels for the ability to vinify plots separately – something he feels is important for quality. There are also  those who feel that the minimum ageing requirements (18 months in oak for Barbaresco and 24 months in oak for Barolo) are old-fashioned, forcing the production of wood-heavy wines that are removed from current tastes – even suggesting that there’s a movement for these minimum times in oak to be adjusted.  As in Burgundy, whole-bunch has become a divisive topic. Some wines have traditionally been made with whole-bunch fermentation (as with Burlotto’s Monvigliero), but now some producers feel a small percentage can help bring freshness in warmer vintages, while others feel it distracts from the terroir, and doesn’t suit Nebbiolo.  Climate change is seeing a shift in the most prized plots, with some producers now feeling south/southwest-facing sites (historically the most desirable) too warm, and north/northeasterly exposure better for the long term, or finding other ways to manage global warming. Land prices have been rising, and there’s an increasing amount of outside investment, as well an increasing number of producers arriving from beyond Piedmont – although there are still those, such as Vietti’s Eugenio Palumbo, Burlotto’s Alessandria or Gaja’s Gaia Gaja, who were born and bred here, and have been embedded in the industry, and often their family business, their entire lives. We dove into recent vintages, especially the very different yet both excellent 2020 and 2021s, the former open and approachable, the latter closed and needing time. We talked about clones and rootstocks, the persistence and suitability of Chardonnay in the Langhe, the pressure on the region’s biodiversity – and much, much more.  We’ll be publishing more in the coming weeks and months, as well as shining a light on the wines of the region – one that should be part of any collector’s cellar. But, as with the wines here, there is so much to consider. As Nicola Oberto of Trediberri told us, “It doesn’t need to be obvious – it needs to be interesting.” And that, the endless nuance and complexity, is what makes the region’s great Nebbiolo so enchanting.  Keep an eye out for more on Piedmont over the coming months or browse all current listings from the region

The allure of the Langhe

Few people have been lucky enough to be as immersed in Burgundy’s finest wines as Martin Donatsch. His father bought a pallet of top Burgundy, including those of Domaine de la Romanée Conti (DRC) and Armand Rousseau, every year from the early 1970s onwards. Martin’s birth in 1978 – a fantastic vintage in Burgundy – only encouraged his father to buy more, and Martin, now in his early 40s, has been enjoying wines from the family collection ever since. Just last week, he uncorked a 1978 DRC Echézeaux. This immersion has provided him with an extraordinary understanding of Chardonnay and Pinot Noir – something that has doubtless helped him become one of the world’s great emerging winemaking talents. Donatsch is one of a small number of producers growing Pinot Noir, Chardonnay and the native Completer grape in Bündner Herrschaft in Switzerland. This tiny Swiss valley, for the time being, remains largely unknown – but, as Donatsch certainly believes, it may just be one of the world’s last great regions for fine wine production.The altitude (500 to 700 metres above sea-level) sees the vines flower a week later than is typical in Burgundy, yet picking dates are three to four weeks later. This provides a much longer growing season, allowing for complex flavours and aromas to develop in the grapes. Despite the altitude, the grapes reach good levels of ripeness thanks to the warm, dry wind – known locally as a “foehn”, that sweeps through the valley. Unlike Burgundy, autumns here are dry, so there is rarely pressure to pick before rain arrives, allowing for additional hang-time. The altitude keeps the acidity high, offsetting the naturally slightly higher alcohol (typically around 14%), meaning the wines never feel overly alcoholic. While Bündner Herrschaft has been home to Pinot Noir since the 15th century, Donatsch – now in the hands of the fifth generation – has pioneered the quality revolution in the region. Martin’s father Thomas Donatsch was not only the first to – then illegally – plant Chardonnay in 1975, but also the first to introduce French barriques to Switzerland, influenced by his vigneron friend André Noblet, the winemaker at Domaine de la Romanée-Conti from 1945 to 1986. In the early 1970s, Thomas – a young 20-year-old about to take on the family winery – set off to learn from the best. Obsessed with Burgundy from a young age, he knocked on the door unannounced at Domaine de la Romanée-Conti. In a fortuitous set of circumstances, Noblet had just returned from his first ever holiday (in Gran Canaria) and the first extended time away from his beloved wines. He had missed his wine cellar so much during the trip, he couldn’t wait to return. Finding the young Donatsch sitting by the door and desperate to reacquaint himself with his wines, Noblet invited Thomas to spend the afternoon with him tasting the different cuvées from barrel. Martin believes his dad gained Noblet’s trust by initially criticising DRC’s Montrachet 1968. Tasting the wine Donatsch reportedly said, “There is no way this wine could come from the great Montrachet!” A little precocious, perhaps: fortunately Noblet agreed it wasn’t his finest vintage, but the result of experiments in the winery. It was the beginning of a lifelong friendship, with Donatsch returning to the DRC cellars every year. On each visit, Noblet would always pour him a glass of Montrachet 1968 and ask his opinion before tasting any of the other wines. It wasn’t long before Donatsch was buying a pallet of Grand Cru Burgundy every year (at that time a bottle of La Tâche was just over £35 a bottle). Noblet also started to help Donatsch improve his Pinot Noir – first by giving Thomas his first three French barriques. These weren’t just any old barrels though, they had previously held La Tâche and were made by François Frères – who at the time had just two customers, Domaine de la Romanée-Conti and Henri Boillot. Donatsch took the barrels back to Switzerland, and the winery has been using François Frères barriques ever since. I asked Martin why the introduction of French barriques in Switzerland was such a revolution for the region. At the time, he says, the Swiss wine schools were obsessed with cleanliness – teaching the importance of filtering wines, using protective winemaking methods and using stainless steel tanks even for the red wines. The use of barrels was the opposite; it meant no additional filtering and a more oxidative environment. Donatsch believes the introduction of barriques around the world revolutionised fine wine. Angelo Gaja was the first to do it in Italy; Torres the first in Spain; Mondavi in the US; and Keller in Germany. But Thomas Donatsch was doing this 10 years before any of them, thanks to the influence of André Noblet, as well as Jean-Bernard Delmas – the winemaker at Château Haut-Brion, another of Thomas Donatsch’s influential friends.  Speaking with Martin Donatsch, you can’t help but feel he has got all his priorities in order. The small size of his winery means he can control every aspect of production, while benefitting from the variety that a life in wine can offer. Producing just 35,000 bottles a year means that when he is not in the vineyard tending his crop, he is in the winery, or fulfilling orders and redesigning his website (graphic design is another passion of his). Being one of the country’s most prestigious winemakers he sells his wine into the country’s top restaurants and luxury hotels, who can’t get enough of his wine. Donatsch’s annual release of wines sells out in just hours. While this is a great sign of his talents, it is also why many people outside of Switzerland have never heard of, let alone experienced, the world-class Pinot Noir and Chardonnay from the winery. Despite the demand for the Donatsch wines, there are no plans to expand: firstly because the authorities won’t allow it, but second because Martin loves the “human” size of the business and doesn’t want to lose that. Martin is, however, keen for more people outside of Switzerland to taste them. Beyond the tiny volumes that make it as far as export, to source these extraordinary wines you’ll have to (when one can) visit the winery yourself. The high life: Martin Donatsch

Few wine regions have seen a transformation as significant as Tuscany has over the last 15 years. These days the region regularly produces some of the finest wines found anywhere on the planet, while retaining a distinct sense of place.  Tuscany is the only region in the world to have truly tamed Sangiovese, with nowhere else able to grow this fussy grape variety and produce wines of the same level. At the same time, Tuscany has managed to produce some of the world’s finest renditions of the better-travelled international varieties such as Cabernet Sauvignon and Merlot; even Pinot Noir and Chardonnay are finding a foothold in this magical enclave of central Italy. Few have been as influential in this transformative journey than San Guisto a Rentennano’s Luca Martini di Cigala, who has managed to produce not one but two of the region’s most iconic wines – Percarlo (100% Sangiovese) and La Ricolma (100% Merlot). In his typically modest manner, however, he does not believe great wines are made by great winemakers – but by understanding where a vigneron must focus their attention in the vineyard. According to Martini di Cigala, winemaking can improve the quality of a wine by no more than 10%. “Great wine, however, is made with great fruit,” he says. So what is it about Tuscany that has resulted in the region’s recent renaissance? For Martini di Cigala, it has been understanding how the region’s unique soils and climate, if allowed, can produce wines where the character of the terroir prevales, rather than the varietal. “When it is the opposite and the varietal character is more evident than the character of the place, of the area, of the soil,” says Cigale, “to me it doesn’t make much sense.” It is the vineyard that must do the talking, not the grape variety, nor the winemaking. While the Tuscan wine renaissance began in the late 1970s and early ’80s, the meteoric rise of the region was far from linear. Among the new wave of pioneers, there was naivety too and, understandably, external influences started to impact how wine was being made. Back then, San Giusto A Rentennano didn’t have their own personal brand, and were selling wine to the big wineries like Antinori and Ruffino.  Following in the footsteps of the likes of Fontodi, Isole e Elena and Montevertini they decided to focus on improving the quality of their Sangiovese – which began, fundamentally, by reducing the yields in the vineyard. “Before that, we used to produce a good Chianti,” says Martini di Cigala, “a simple wine.” But, with these changes, “The stye completely changed and we began to focus on making wines for long ageing.” As the movement progressed, however, he began to sense a period of self-doubt looming. “Compared to today, where there is a big improvement in the culture of tasting wines and recognising the character of the different varieties,” he says, “people were used to drinking rounder, softer wines. And Sangiovese [made at lower yields] can be so aggressive, so hard with the tannins – especially when young. It was a problem.” At the time, many of the vignerons felt that in order to increase the wine’s ageing potential, the wines needed to be darker and more concentrated, while also exposing the wine to plenty of new oak and more oxygen – opting for smaller 225-litre barrels (barriques) rather than the region’s traditional larger casks. You could see the commercial attraction too, since this approach softened Sangiovese’s tannins. Emerging regions like Tuscany were all looking towards more established fine wine regions for inspiration. The use of new barriques was fashionable around the world but, most notably, part of the Bordeaux recipe of the time. Twenty years ago, Martini di Cigala believes, they wrongly followed these trends, producing intense, overripe, over-oaked wines. “It was a mistake because many wineries didn’t keep the character of the Sangiovese – either due to excessive use of wood, which does not integrate well with Sangiovese, or because it was blended with other varieties to build the wine’s intensity, while softening its aggressive nature.” For Martini di Cigala, even his Merlot plantings weren’t performing well – despite being a variety better suited to the current trends, with better resistance to new oak’s influence. The current recipe was not working for him – or for Tuscany. Early in its renaissance, the region began to stumble. Martini di Cigala’s success came when he realised that, despite sharing the same vineyards, his Merlot and Sangiovese had very little in common. To produce anything better than ordinary, he had to start treating the two varieties completely differently and let the vines do the talking. Sangiovese is a frustratingly fickle variety. It has the potential to produce wines as ethereal as the finest Pinot Noir and as rich and elegant as fine Bordeaux. Yet it has failed to make any real imprint outside Italy and, even today in Tuscany, it remains maddeningly inconsistent. “Compared to other varieties like Merlot, Cabernet Sauvignon and Syrah,” he says, “these varieties can produce wine everywhere. With Sangiovese it is hard because it needs calcareous soil in order to produce the right balance of tannins. In any other kinds of soil, it either increases acidity too much or the opposite, making the wine very flat. To produce a wine with a precise character with a lot of tannin but at the same time integrated with the fruit, Sangiovese needs calcareous soil.” But, he stresses, it is not only the soil but the climate that is important too. “It is difficult to have great Sangiovese that is very, very light, low in alcohol and low in polyphenols [tannins]. The wine must be rich,” he says. The region must be hot. The elegance and the precision, however, come from another distinct attribute of the hillsides of Tuscany: cool night-time temperatures. This, Martini di Cigala believes, is vital for the elegance of the wines – and something that can be lost in warmer vintages. “Sangiovese is very delicate, if there is too much concentration, the level of tannins risk damaging the wine’s natural elegance and the balance,” says Cigala. For me it is a great wine when the wine doesn’t need to show muscle. It is not important to be extremely concentrated or to have a lot of colour for a great vintage. It is more about the balance of the different factors.” He notes that some of the most celebrated vintages aren’t necessarily the longest-lived, highlighting that the cooler 2013 and 2014 vintages will outlive the much applauded, warmer 2015s – although he insists 2016 has proved to be spectacular. Percarlo evolved as Martini di Cigala gradually understood Sangiovese’s sensitivities. Up until 2008, Percarlo was aged 100% in barriques. First produced in 1983, the amount of new wood has been reduced over the years. Today he doesn’t use any barriques at all for Percarlo, or for any of his other Sangiovese wines (Chianti Classico and Riserva). He believes Sangiovese is too sensitive to oxygen to age in smaller barriques. Today it is matured 50/50 in large 5,000-litre and 3,000-litre barrels. Martini di Cigala didn’t start producing Merlot until 1993, but for the first 10 years, he managed the vines similarly to his Sangiovese – with mixed results. “Sometimes the vintage would be very Tuscan in style and then the opposite in other vintages – the aromas were more like Merlot from north Italy with more pepper on the nose. I was never convinced with the results,” he says. The Merlot in Chianti Classico is also very different to the Merlot grown on the Tuscan coast of Bolgheri. The bigger diurnal temperature shifts in the Tuscan hills produce Merlot with more acidity. The wines are, in Martini di Cigala’s words, “more vertical”. The real success of both Percarlo and La Ricolma, Martini di Cigala believes, lies in the bespoke adaptations he started to make in the vineyard for each variety. Sangiovese really benefits from an early green harvest in July – reducing the natural yield. Merlot, on the other hand, proves to be a disaster if you do the same thing and limit your yields so early in the growing season – causing a spike in sugar production at the expense of tannin development.  Martini di Cigala also painstakingly picks the Sangiovese destined for his Percarlo bunch by bunch, assessing each vine individually. Picking Merlot bunch by bunch, in contrast, makes no sense – “it is far too irregular”. While Sangiovese yields can be manipulated throughout véraison to its benefit, Merlot needs to be left alone. “The key for Merlot”, he says, “is to try to slow down its ripening. If the variety doesn’t have a long growing cycle, the wine remains short.” Over the years Martini di Cigala has moved his Merlot vines to the coolest parts of his vineyards. He admits his original La Ricolma Merlot plot is his worst, its west-facing exposition making it too warm. He much prefers his plots closer to the river where temperatures are lower. But the key viticultural work for both his Merlot and Sangiovese starts earlier – he is keen to point out that there is no recipe each year, the cultivation has to be very precise depending on the vines’ needs. “You have to be a good interpreter of the season. Often you don’t notice the stress in the vineyard until July, by which time it is too late. You have to follow the trends of the weather earlier – this is the most difficult point of our job and has become especially true in the last few hotter years.” Each viticultural step has to follow the trend of the season. That, for him, is the key. Over nearly 40 years Martini di Cigala has continued to make tweaks in the vineyards, further improving the wines. Up until 2004 he used to select the Percarlo grapes only from certain parts of the vineyard, but now the fruit is picked bunch by bunch – another fundamental reason, he believes, the wines’ quality has escalated. Martini di Cigala has proven that wines made from Sangiovese and Merlot can be both bold and beautiful, aligning the Tuscan hills’ unique climate with precision viticulture. The hot summers and cool night-time temperatures matched with the calcareous soils are the perfect combination for Sangiovese and are testament to Merlot’s adaptability. After a period of self-doubt and mixed results for the region, the Tuscan renaissance today has well and truly found its foothold and is on an extraordinary run. And it is Percarlo and La Ricolma leading the pack. “If you asked me to name 15 great wineries in Chianti Classico 20 years ago, I would be in trouble,” says Martini di Cigala. “Today I could arrive at 50 or 60.” What has changed most today, according to the winemaker, is a paradigm shift in focus from winery to vineyard. While he is a little disappointed more of them haven’t turned to organic farming (of which he is a longstanding proponent), he believes the change has been very positive. A noble name, a castle, or a famous winemaker today no longer makes the headlines in Tuscany. It is precision viticulture that has taken these distinct wines from the Tuscan hills to the top of many collectors’ wish lists. If you haven’t already heard about Baettig, we urge you to read some of our previous coverage of this rising-star producer. Conceived by Francisco Baettig (the winemaker behind Errázuriz, Seña and Chadwick) and Carlos de Carlos (previously Commercial Director at Errázuriz, he now works for Paul Hobbs) over dinner in London in 2010, Baettig is one of Chile’s most exciting projects – crafting site-driven wines from Malleco and the Maule.  The duo spent years seeking out the right site – realising that to find vineyards that met their standards, they’d have to plant them themselves. In 2013 they put their first vines in the ground, planting Burgundy clones of Chardonnay and Pinot Noir in Traiguén, in the Malleco province. Both Francisco and Carlos had family ties to the region – making it seem like fate.  The site, however, wasn’t chosen purely for their emotional connection to the area, but with an eye on sustainability and quality. This is one of Chile’s southernmost wine regions, with red clay, clay loam and volcanic soils, cool conditions, 25% less sunshine than the Central Valley and – most importantly – plentiful rainfall, allowing them to dry-farm the vines and produce restrained, Burgundy-inspired Pinot Noir and Chardonnay with moderate alcohol levels, bright acidity and vibrant fruit. Francisco is clear that the quality of their vine material has been key to their success – as it is only relatively recently that Chile had access to high-quality, clean Burgundy clones.  While Baettig started with Chardonnay and Pinot Noir, the producer has since added Cabernet Sauvignon from old vines in the Maule to the range, unsurprising given Francisco made his name making Chile’s icon wines.  Fourteen years after they first imagined their joint project, we welcomed Francisco to London to look back at the Baettig journey so far – tasting through a vertical and exploring how the project has developed and evolved.  About the Baettig range  There are currently two tiers to the Baettig range, with the idea that a top tier, single-vineyard offering that will be their “Grand Cru” of sorts, is likely to be added in the future. The current range comprises:  Vino de Viñedo: these wines are a vineyard selection designed for earlier drinking, effectively a “village” equivalent. The Chardonnay and Pinot Noir at this level go by the name of Los Parientes (“the relatives”, a reference to the closeness of the different parcels), while the Cabernet Sauvignon is called Los Compadres (“close friends” – a tribute to the growers with whom they’re working). Los Compadres is sourced from various dry-farmed, cool plots in the more coastal areas of the Maule, with the vines all over 30 years in age and some up to 150 years old, creating lively, juicy and intense expressions of Cabernet Sauvignon. The first vintage of the Los Parientes Pinot Noir and Chardonnay was 2019, while the first vintage of the Los Compadres was 2021. These may be the entry point to the Baettig range, and they are made to drink on release, but they also – like good village Burgundy – have capacity to evolve and will only benefit from an extra year or two in bottle.  Selección de Parcelas: their “Premier Cru” equivalent range, made in smaller volumes from specific parcels and built for longer ageing. These wines see a higher proportion of new oak and longer ageing prior to release. The Chardonnay and Pinot Noir are labelled under the Los Primos name (“the cousins”), while the Cabernet Sauvignon is named Los Padrinos (“the godparents”). The Pinot Noir comes from their El Primo, Chuir, and La Cuñada parcels, chosen for their elegance, structure and ageing potential; while the Chardonnay comes from the Triángulo and Llaima parcels, creating mineral, vertical wines that are all about tension. The first Los Primos Chardonnay and Pinot Noir were made in 2016, with the first wide release from 2017, and Los Padrinos was first made in 2022. Volumes of these wines are tiny, with just 300 to 350 cases made of each of the Selección de Parcelas.  About the winemaking The emphasis with Baettig is firmly on expressing site – and as such the winemaking is very “light touch”, allowing the sense of place to shine through in the wines. The style has evolved, with the use of oak reduced a little from the earliest vintages, generally shifting toward less time in barrel, larger casks and smaller portions of new wood. The fruit is all hand-picked and fermented with indigenous yeasts. The cooler sites, combined with the way Baettig farms and when they harvest, produces fruit with naturally low pH, allowing them to use minimal amounts of sulphur (although with sufficient doses to allow the wines to age and be shipped around the world).  For the Chardonnay, it is all whole-cluster pressed and cold-settled, prior to native ferment in old French barriques. Malolactic fermentation on the Chardonnay is left to happen or not, according to the vintage conditions (with often around a third going through). The élevage for all the wines varies according to the vintage, but the Los Parientes Chardonnay normally spends eight to 10 months in cask, with up to 15% new oak, while the Los Primos spends between 10-15 months in barrel with up to 35% new oak. The new oak for the Chardonnay is all larger 300- and 400-litre casks. A portion of the Pinot Noir is whole-bunch fermented (typically 10-20%), with the rest de-stemmed – with fermentation all in used oak. The Los Parientes stays in barrel for around eight to 10 months, with up to 15% new oak; for the Los Primos, it is 15-16 months, with up to 40% new wood – with the new oak all 300-litre barrels.  For the Cabernet Sauvignon, the fruit is all de-stemmed. Fermentation temperatures are low at around 24-28˚C, with maceration for a maximum 20 days, given the natural concentration and structure of the fruit. The Los Compadres is aged for 10 months in French oak (20% new), while the Los Padrinos spends 15 months in 65% new oak (including around a third in larger 300-litre barrels).  Tasting through the range, there is a clear stamp of style – a flinty restraint, with the emphasis on crunchy fruit and minerality, vibrant acidity, moderate alcohols. While some of the earlier vintages might have offered more overt oak in their youth, this has integrated with time in bottle – and the wines offer at most a subtle spicy complexity. They are beautifully judged, pure expressions of Traiguén.   About the vintages 2022: Generally speaking, 2022 was an outstanding vintage. In Malleco, the year was cooler than average. Winter was relatively dry, with little rain in spring and cool conditions including frost in September and October, leading to particularly low yields. Weather warmed up in February before cooling again in March and April, which also saw quite a lot of rain. This resulted in a late harvest of a small crop of fruit, with great intensity, concentration and excellent tension – with high acidity levels retained thanks to the cooler conditions. In the Maule, the season was moderately warm, producing a more generous yield than further south but similarly high quality. The weather here was warmer in December and temperatures close to average from January through to March. Moderate rainfall in March and April refreshed the season and eased the final stage of ripening, with the fruit offering good acidity, colour and aromatic intensity. The 2022s offer an up-front richness of fruit, with good backbone of acidity – in some ways a combination of 2020 and 2021.  2021: The 2021 vintage was a cooler year – producing wines where the emphasis was on elegance, finesse and tension, perfect for the Baettig style. The winter in Malleco was rainy, with 650mm of water over June and July, laying the groundwork for a good budbreak. Spring was dry and reasonably warm, although a late frost in September reduced yields. Summer was cool, with some rain over December and January (90 mm in total across the two months), allowing the fruit to ripen slowly ahead of a late harvest, developing great aromatic complexity and preserving the acidity levels. These should age particularly well.  2020: This was a warmer year versus 2021, producing richer-styled wines. There was plenty of rain in June and July, however this dried up in August, with little rain for the rest of the growing season. Temperatures rose and the hot, dry conditions allowed the grapes to ripen easily, although an early harvest was key to preserve freshness and tension to complement their natural intensity and generosity. Offering a little more flesh, particularly at this more youthful stage, versus the 2021s, the 2020s are juicy and open, yet with everything in balance. The one we’d pick for drinking now, although there is certainly no rush here.  2016: A rainy winter led on to a cool and rainy spring, with later-than-normal flowering and fruit set and a small crop. Summer was dry and largely warm, and the fruit was harvested early, producing wines that combine refreshing acidity and good density of fruit. The 2016 Los Primos Pinot Noir and Chardonnay were never released, the tiny volumes of Baettig’s first crop, so it was a real treat to taste these special bottles, offering a glimpse of the wines’ ageing potential – with both drinking beautifully.  The vertical: tasting Baettig Chardonnay 2022 Vino de Viñedo Los Parientes Chardonnay: This was really showing well, even though it has only just been released. It’s tight, full of energy, with a punch of minerality, bright taut citrus and crisp green apple. It’s lean and sleek, but with a fleshy, juiciness that makes it hard to resist now. A wine that’s singing. Aged for eight months in 15% new oak. Production: 7,254 bottles  2021 Vino de Viñedo Los Parientes Chardonnay: There’s a lick of lime curd on the nose here, with tightly wound greengage emerging with air. It’s pure and linear, driven with its intense, stony purity, but there’s a pleasing fatness to the fruit behind, with a mouth-wateringly juicy finish and long, saline tang to the finish. Aged for 10 months in only used oak. Production: 16,909 bottles  2020 Vino de Viñedo Los Parientes Chardonnay: The warmth of the 2020 vintage, combined with the cool climate of Traiguén and Baettig’s trademark flinty, lean style, has created a gorgeous Los Parientes in 2020. Now with a few years in bottle, it’s drinking beautifully. The wine remains taut – dominated by vibrant citrus that drives through its core, and the bright acidity brings incredible tension. Yet, there’s also a softness to the wine, with a suppleness to the palate and its ample riper stone fruit that flawlessly complements the mouthwatering zest of the long finish. Punches well above its weight. Aged for 10 months in 10% new oak. Production: 15,240 bottles  2021 Selección de Parcelas Los Primos Chardonnay: The 2021 Los Primos is incredibly impressive – and the step up from Los Parientes clear. There’s a creamy, lactic note on the nose, working alongside lemon curd, honeysuckle and bright citrus and green fruit. There’s a lushness to the fruit, with gorgeous length and energy, outstanding tension and an everlasting finish, with stony, saline minerality that lingers long after the wine is gone. You can drink this now, but it will be even better if you can give it a couple of years in bottle. Aged for 15 months in 35% new oak. Production: 3,480 bottles  2020 Selección de Parcelas Los Primos Chardonnay: Much more open now than the 2021, the 2020 Los Primos is rich and concentrated, with riper white peach fruit and honeyed complexity. There’s a softness to the wine, reminiscent of the suppleness of the 2020 Los Parientes, but additional depth here. It’s round and enticing, still with a backbone of taut acidity, and a long finish with just a touch of oak spice. Hard to resist now, drink this over the next five years. Aged for 15 months in 38% new oak. Production: 4,069 bottles  2016 Selección de Parcelas Los Primos Chardonnay: The first vintage of Selección de Parcelas, with the very first fruit from the Baettig vines, and never released. The 2016 is showing some beautiful development, with honey, sweeter plump peach and nutty complexity. Cooked apple and dried mango sit alongside a zing of limey citrus, with a line of bright acidity that runs through the palate and brings lovely energy. Gorgeous. Aged for 16 months in only used oak. Production: 2,160 bottles  Pinot Noir  2022 Vino de Viñedo Los Parientes Pinot Noir: There is 10% whole-bunch in this vintage, and combined with the youth of the wine, it is shining on the nose – with overt pepper spice, floral perfume and stemmy complexity that makes it aromatically enticing. The palate is pure and bright, with juicy but concentrated mulberry and black cherry, with a saline edge and fresh, chalky purity. Incredibly moreish. Aged for eight months in 14% new oak. Production: 13,205 bottles 2021 Vino de Viñedo Los Parientes Pinot Noir: For this cooler vintage, Francisco opted to reduce the portion of whole-bunch fermentation a little. The wine is bright, crunchy and pure, with a lovely restraint from the extended growing season. Floral tones (rose, violet) sit alongside crunchy red fruit, leading to a palate of effortless purity and length. Vibrant, mouth-wateringly fresh with an earthy, saline finish and very fine tannins. Aged for 10 months in 10% new oak. Production: 13,400 bottles  2020 Vino de Viñedo Los Parientes Pinot Noir: This is in a lovely spot right now – sharing the supple texture of its Chardonnay sibling. It is beautifully elegant, with tealeaf aromatics, gentle spice and crunchy berry fruit. Structurally, it is fine-boned – the fine, chalky tannins adding a graceful outline to the mouth-watering fruit. Gloriously fresh, the finish is saline with the slightest hint of smoke. Dangerously drinkable and incredible value. Aged for 10 months in 10% new oak. Production: 15,180 bottles  2021 Selección de Parcelas Los Primos Pinot Noir: This is such a baby at the moment – and clearly needs time to reveal its full potential. It’s much more savoury than the 2020. There’s some gunflint reduction, but beneath that smoky intensity and an earthiness, alongside the subtle florals, bright redcurrant and raspberry. There’s more grip to the tannin, a tightness to the fruit, but the structure and length offer great promise. A wine of tension. Made with 20% whole-bunch fermentation, aged for 16 months in 34% new oak. Production: 3,409 bottles 2020 Selección de Parcelas Los Primos Pinot Noir: It’s immediately evident that this is Baettig’s Premier Cru – with notably more concentration and complexity. The warmer 2020 vintage produced a vibrant and intense wine, with vivid, juicy red cherry and raspberry fruit, complemented by more delicate floral notes. Alongside the impressive weight of fruit, there’s a pomegranate freshness and mineral line, with the slightest hint of smoke and spice, and a framework of superfine, supple tannins. Made with 20% whole-bunch fermentation, aged for 15 months in 38% new oak. Production: 4,102 bottles 2016 Selección de Parcelas Los Primos Pinot Noir: This was, for me, the star of the tasting. The nose was effortlessly complex, shifting between soft florals, spice, violets and crunchy red fruit, with a dried-earth note too. There was a glorious suppleness here, silken and flowing across the palate, with a fine, chalky texture to the tannin, juicy cherry and a subtle, savoury finish. Beautiful. Everything was destemmed in this vintage and the wine aged exclusively in used oak. Production: 1,440 bottles  Cabernet Sauvignon  2022 Vino de Viñedo Los Compadres Cabernet Sauvignon: This is a glorious expression of bright, modern Cabernet – pure and pristine with crunchy red and black fruit, vivid pencil shavings and an herbaceous green-pepper edge. There’s such intensity to the palate, with its tart red berry fruit, mouth-wateringly fresh and juicy. The abundant fruit is framed by graphite tannins, leading on to a spicy finish. Aged in 20% new French oak for 10 months. Production: 17,000 bottles  2022 Selección de Parcelas Los Padrinos Cabernet Sauvignon: The first vintage of Los Padrinos is only offering more since we first tasted it in February. It’s strikingly different to Los Compadres – a much darker, spicier and smokier expression. The two wines share their tension, with firm acidity that forms the backbone of this wine and drives the long finish, as well as gloriously crunchy and fresh fruit. The nose is savoury and brooding at first, but sweeter plum and cassis fruit lurks behind, while there’s a tart, bright bite to the palate. It still feels compact at this youthful stage, the power and gum-drying tannins needing time to unfurl. Aged for 15 months in 65% new French oak.
