Introduction The Côte d’Or, the Golden Slope, enjoys a reputation and exerts an influence in the wine world out of all proportion to its size. It possesses none of the grandeur of the Douro Valley, for instance, nor the picture-postcard beauty of South Africa’s winelands. It is not majestic; its beauty is serene, and what strikes the observer time and again is the tiny scale. From north to south it is about 50 kilometres long, is sometimes less than a kilometre wide, and can be driven in little more than an hour. At a push it could be walked in a day. Yet for a thousand or more years this favoured slope has yielded wines that have entranced and delighted wine lovers, with a fair measure of frustration and disappointment thrown in too. Avoiding hyperbole when writing about the Côte d’Or is a problem, for it has held people in thrall for centuries, frequently prompting poetic flights of prose: ‘The Pathetic Fallacy resounds in all our praise of wine … This Burgundy seemed to me, then, serene and triumphant … it whispered faintly, but in the same lapidary phrase, the same words of hope.’ Thus wrote Evelyn Waugh in Brideshead Revisited eighty years ago. Literary critics might cavil at such prolixity, and Waugh himself tamed it severely in later editions, but it was enough to intrigue me decades ago and engender a love for the region and its wines that has never waned. Greater Burgundy is a bigger, more geographically diverse, region than might first be supposed, stretching from Chablis, south-east of Paris, to Beaujolais, north of Lyon. The subject matter of this book, however, is Burgundy’s heart, the Côte d’Or. There is no more celebrated stretch of agricultural land on earth. It has been pored over and analysed, feted and cosseted, obsessed about and sought after for centuries and today, if anything, it exerts a greater pull on wine lovers than ever before. ‘Astronomical’ does not begin to describe the prices now being paid for prized patches of grand and premier cru vineyard, and for the wines produced from them by the top domaines. Such prices hog the headlines and paint a dazzling, though severely one-dimensional, picture of the Côte d’Or today. In the early years of the twenty-first century they are part of the story but they are not the only part. This book aims to get behind the dazzle and flesh out the story, to add some nuance and extra dimension. The Côte d’Or cannot be captured in a sound bite nor, it must be admitted, in a book of this scope – but my hope is that it may add another chapter to the ever-unfolding tale, setting it in the early years of the twenty-first century, a period that may come to be considered by future historians as a golden age for Burgundy but which has brought its own challenges in the shape of those ludicrous prices, the scandal of premature oxidation in the white wines, and the increasing challenge of dealing with extreme weather events such as hail and spring frost. The Côte d’Or has been the subject of forensic scrutiny for centuries, generating a library of books, so why another one now? For the simple reason that it is ever changing. Every year sees new names added to the producers’ roster and old ones slipping away, and thanks to this ongoing evolution the infant domaine of today can be the superstar of tomorrow. The core of the book comprises about a hundred producer profiles. Many fine domaines and négociants whose wines I am happy to purchase and drink have not found a place here. It is important to stress that they have not been included, rather than excluded, simply for reasons of space. The aim was to feature a representative collection of producers, not a top-down selection of the most celebrated names in descending order of renown. As a consequence this book is not, nor was it ever intended to be, a comprehensive A to Z of producers. I write as an amateur du vin, an enthusiast whose admiration for the wines of Burgundy stretches back over four decades, and who has been visiting the region and writing about the wines for some thirty years. I do not trade in wine. I try to see beyond the wine to get something of the backstory, the story of people and place that makes the Côte d’Or so fascinating. To examine the wines in isolation is to dislocate them from that, and not knowing something of the backstory precludes a full understanding of them. A broad lens must be brought to bear on the côte. Too narrow, and the wood will never be seen for the trees. I have learned much by coming across things serendipitously rather than dashing hither and thither, seeing a lot but noticing little. Without time for assimilation and reflection, subtlety and shade are missed. Finally, no gustatory experience can match the thrill of a great Côte d’Or red drunk at its peak. The colour, crimsoned by age; the heavenly scent, perfumed with notes of sweet decay; a sauvage edge, the palate lively and tingling, managing to be so many things at once, oscillating between fruit and spice and meat and game, a merry-go-round of flavour, spiralling on the palate, refusing to be pinned down by anything so prosaic as a tasting note. All the primary components melded by age and yielding up new ones, unsignalled when the wine was young. Everything cohesive and in harmony, like a great orchestra playing at its best. Above all, vital and living, endlessly enchanting and intriguing, engaging the palate and the spirit like no other wine. “We’re just sort of making it up as we go along,” Andy Erickson says to me on our transatlantic Zoom call, shrugging and smiling as we talk about his and his wife’s project, Favia. It’s not necessarily what you’d expect this star consultant winemaker to say – having helped craft the likes of Screaming Eagle, Harlan, Dalla Valle, Staglin, Mayacamas and more. It’s hard to believe that anything this man does is a fluke of fate. And yet this self-effacing tone is a thread that runs throughout my conversation with Erickson and his wife Annie Favia.  Favia brings her own, similarly enviable resume, having worked at Kongsgaard, Corison and for many years alongside cult viticulturist David Abreu, giving her unparalleled experience of Napa’s finest vineyards. She and Erickson met at a dinner party almost 30 years ago, instantly hit it off, and within six months were making their first barrel of wine together, tucked in the corner of their garage. That first experimental barrel of 1996 Russian River Pinot Noir (of which they still have a few bottles) was the start of something that grew as they and their family did, and the Favia label was born in 2001, although it was a couple of years before there was more than a barrel or two to sell.   The concept behind the brand is simple: “It’s our expression of what we think Napa Valley wine should be,” explains Erickson. But Favia has also been a project where they could experiment, push the envelope and play with the “pioneering freedom” (in Erickson’s words) that Napa offers. The flexibility to purchase grapes from different areas, pick and choose varietals, and work with no constraints in the winery is something they clearly savour.  The project focuses on Cabernet Sauvignon and Cabernet Franc – the latter in particular a grape they both love. Inspired by the likes of Ausone, Cheval Blanc, the reds of the Loire and Dalla Valle’s Maya (a wine that Erickson now makes), they were keen to play with the varietal, crafting two Cabernet Franc blends – Cerro Sur and La Magdalena. As Annie Favia explains, “[Cabernet Franc] allows you to make one kind of wine if you pick it at one time, and then a completely different wine if you pick it at another time.”  More than anything, however, Favia is about expressing a sense of place and connection to the land. “When I was growing up, my mom was an avid gardener and I spent a lot of time with her in the garden,” says Annie. “So it's always been really kind of home to me.” It’s unsurprising perhaps that their Coombsville property is far from just a vineyard and winery, but a homestead of sorts. “We really love to grow all kinds of things,” Annie says eagerly. While vines are the main crop, Annie also farms a range of other plants – largely for her loose-leaf tea company, ERDA, but also fruit and vegetables for the family table. “Growing different crops allows you to look at grapevines in a different way,” she explains.   For the Favia label, they work exclusively with fruit from Oakville and Coombsville, and while Oakville is arguably one of the most prestigious appellations in Napa, Coombsville is less well known. Fruit from the AVA has often been blended away into regional wines, but with its volcanic soils and proximity to the San Pablo Bay bringing cooling influences, they love its concentrated power, naturally fresh acidity and savoury quality, and more forward-focused tannins versus the broader profile of Oakville.   Although Erickson is increasingly focused on Favia, he still consults for a handful of carefully selected estates – something he can’t see giving up. “It’s a great outlet,” he tells me, explaining how different it is to channel a client’s vision for a project, versus craft your own wine exactly the way you want. Much like the various crops they farm, it’s another way for them to learn, experiment and develop. And yet, “Presenting something that you’ve made to people and getting a response…” Erickson says. “I love that part of what we do.”  Two decades after Favia was born, they’ve received significant investment from the Huneeus family (which owns Quintessa), along with a new 86-acre property in Oakville, where they’ll soon be starting work on a new winery, taking the project to the next level. “We’re going to be doing exactly what we’ve done for 20-plus years, but now have an even bigger farm and more fruit trees and more gardens and more wine to share with people. And it’s just really fun,” says Annie, the excitement clear in her expression. They’ll be bringing back Sauvignon Blanc, which they’ve made in the past, and are making their first wine with a tiny plot of Malbec they planted – a variety they’re considering with climate change.  On paper, Favia and Erickson are a formidable duo – with CVs that offer a roll-call of Napa icons – and yet they are entirely unassuming. Their absolute passion for the vine, for farming, the region and their craft shines through; and while they might be as down-to-earth as they come, it’s already clear that Favia is destined to reach great heights.  The latest releases of Favia are available now

Growing up: Favia

In a report published in 2014 by the UN’s Food and Agriculture Organisation, under current rates of degradation, all the world’s topsoil could disappear within 60 years. With 95% of all food produced relying on these living soils, this pronouncement was a stark and terrifying warning of what lies ahead. Industrial farming and deforestation are the leading causes behind the degradation of soil. Grape growing and large parts of the wine industry remain very much part of that problem. France’s vineyards, as an example, are the country’s biggest consumers of chemical fungicides, insecticides and herbicides. These products can devastate the life in the soil and completely disrupt the biodiversity of a region. Although viticulture represents just 3% of France’s agricultural land, the sector spreads 20% of the country’s fungicides. Many vignerons have tried to reduce chemical inputs, either using them as a last resort or not at all. Some believe non-chemical additions of copper and sulphur typically used to treat fungal diseases (the biggest threat to yields) are more damaging to the environment than systemic chemical interventions. It is a complex picture. But there are vignerons committed to non-chemical approaches – growers who believe they can offer alternative methods that are both sustainable for the future and remain commercially viable. While there are various approaches, they all share the belief that protecting the health of the soil is fundamental to their vineyard’s long-term future, as well producing a farming system that is not only sustainable but regenerative, in that it sequesters more carbon dioxide in the soil than it takes out. Exactly how this is practised remains a contentious debate. Many of these growers are certified organic, many are not – certification itself is another controversial issue. Biodynamic farming is organic farming with a more holistic approach, trying to recreate a natural balancing ecosystem that allows nature to restore and rejuvenate itself, in rhythm with the lunar cycle. Others have gone even further and have allowed their vineyards to grow wild, believing that an undisturbed vineyard is the most sustainable and ecologically healthy. Organic and biodynamic farming practices are essentially a return to conventional farming methods carried out prior to the introduction of chemical farming 70 years ago. The more non-interventionist approach goes one step further, attempting to recreate an environment that pre-dates all commercial farming. It is an approach in which crops and other plant life coexist together, allowing the environment to dictate what grows where. Under the teachings of Masanobu Fukuoka, it was coined “natural farming”. Masanobu Fukuoka was a Japanese microbiologist and agricultural scientist who studied plant pathology. After nearly dying during a bout of pneumonia, he experienced what he described as a profound spiritual experience – leading him to begin to doubt modern agricultural science. He gave up his scientific post and returned to his family’s farm on the southern Japanese island of Shikoku. It was here that he developed his own non-intervention farming techniques, which involved no tilling or ploughing, and no fertilisation of the land. This was to protect the vital microorganic life in the soil, that he believed was essential to creating an ecologically balanced environment. The publication of his seminal book, The One-Straw Revolution, in 1975, went on to influence the permaculture movement (no till, no ploughing) in the west, and even more radical concepts. Alsace-based viticulturist Bruno Schloegel (of Domaine Lissner) is one such radical. He has a nine-hectare estate that, over the last 20 years, he has adapted to what he calls the “savage” approach to viticulture. For him, “savage” is a more accurate translation of Fukuoka’s methods. “I asked my Japanese friends to translate Fukuoka’s Japanese term,” says Schloegel, “and it translates as something between being free and alive. But not just the vines, the whole system of animals, insects, fungus. The key is not to disturb, as this will weaken the system.” For Schloegel it is a better translation than “natural” which today, he believes, no longer means anything. Despite adopting Fukuoka’s ideas, Schloegel was in fact practising the same approach before he was even aware of the Japanese farmer’s book. “I never knew about Fukuoka until a few years ago. I was given his book and it was amazing. Almost every page, we were totally linked.” Both former scientists, Schloegel too became frustrated by the scientific data available. “It is more complex than the techniques we have been taught,” he says. “Even when I was a student, I thought this. I am a scientist as he was. I studied in the ’70s. He studied in the ’60s. But our conclusions are the same. The answer is to not disturb.” Prior to Fukuoka, Schloegel was taken by the work of the eminent English scientist Dennis Noble, a pioneer of systems biology whose publication The Music of Life became a huge influence. Noble uses the analogy of life as many orchestras playing different scales, very small and very big. “Molecules, atoms, landscape, living beings as well as the vine – all are playing together and that is what we call life. We can listen to each scale of this living system, and you will find almost the same music, because it is totally coherent. Each scale is in harmony. It was very inspiring to me,” Schloegel explains. Like Fukuoka, Schloegel has a strong respect for spirituality as well as science and talks about how the human brain deciphers experiences differently. He uses music as an example, describing how listening to music creates an emotional reaction which the scientific part of your brain can’t explain. “Knowing you only have a small knowledge of this complexity, this complexity of nature, makes you humble. But spiritually you get pleasure from living with this complexity and not trying to control it. It’s just like a wave you are surfing on. This is the pleasure side.” As well as adopting a no-plough, no-till approach, unlike biodynamic farming, Schloegel does not sow seeds for cover crops, nor use any organic fertiliser, preparations or other inputs. He believes his vines’ roots not only root deeper, but are more resistant to disease and suffer less from stress. He also saves on the costs of such additions. So what does he do? He prunes the vines each year – very late in March/April just prior to the new buds forming – and he mows between the rows just prior to harvest. He does also use copper and sulphur, when necessary, to tackle disease but believes he can phase this out. Beyond that, the vineyard is left to its own devices. It is hard to keep up with Schloegel sometimes – his concepts are unconventional, but this holistic approach is highly considered. It is completely at odds with the commercial farming approaches and understandably has caused controversy. But he, along with a growing number of viticulturists around the world, is totally committed to the concept that permaculture is essential to the future long-term health of arable land. He believes he can not only produce an economically viable crop (up to 40hl/ha), but he can produce wines with greater complexity and terroir expression. He believes it takes between seven to 12 years of not disturbing the vineyards for them to find their balance. “At this point you are on the crest of the wave – it is very calm,” he says. But this is a long process and requires a lot of faith to commit to. Even Schloegel admits it gets worse before it gets better, as the vineyard adapts. “When you stop the herbicides, the mowing and the ploughing, you get the bad weeds. But these weeds prepare the soil for the next generation of plants,” he says. Poppies, lilies, thistles, wild orchids then start to appear and then fruit and vegetables and a huge variety of plant life and wild flowers begin to grow. His vineyards today have a huge variety of plant and wildlife species coexisting, with cherry, apricot, fig, almond trees and wild vegetables, flowers, fruits, and aromatic herbs all growing between the vines. What then happens seems incredible. Schloegel explains, once in equilibrium you see distinct plants continue to grow in the same place each year, depending on the terroir of that part of the vineyard. There is one part of his vineyard where 30 metres of wild strawberries appear every year, growing alongside the vines. In other parts there are leeks, other parts a particular herb. Schloegel outlines that even within a single vineyard, very little is exactly the same. The composition, altitude, slope, geological make-up are all different and, when left to adapt, one vineyard grows multitudes of plant species at different levels of concentration in different parts of the vineyard, depending on what adapts best to that particular spot. This is what Schloegel believes is real terroir in action: “A terroir is a full, complex living system – and a wine of this terroir is a response. In this totally free, rich, complex place. I know it is possible for natural systems to rebuild from themselves. But it cannot be fostered.” Fukuoka’s farm on the island of Shikoku in southern Japan was a rice and citrus fruit farm and, while he managed to produce commercial yields of both rice and fruits, the transference of his techniques to the vineyard is not quite as straightforward. The concepts are radical and while a few like Schloegel are convinced it’s possible – with his own yields varying from 10-40hl/ha, others remain sceptical. Schloegel’s Alsatian neighbour Olivier Humbrecht MW (of Domaine Zind-Humbrecht) does not believe a non-interventionist approach is a good idea – nor that it is necessary for making wine a sustainable crop for the future. While Humbrecht accepts there may be many good ideas in terms of regenerative methods that heighten biodiversity and increase the health of the soils, he is sceptical of its long-term future. Humbrecht’s fundamental criticism is that Schloegel’s approach is not as undisturbed as he claims.“A vine is a cultivated plant,” says Humbrecht. “You are cultivating something, disrupting something natural and making it not natural. It is not natural to plant vines one metre apart on a slope, in poor rocky soil, in a place where it doesn’t rain much. It’s not natural to force it to produce grapes every year. So you have to compensate this with something.” For him, permanent cover leads to soil compaction – with the shallow roots of these plants and the topsoil damaged when working in the vineyard – which has graver long-term effects than tilling or ploughing. These stresses on the vine, Humbrecht explains, are exactly why we have flavour in our wines. Each of these stresses, whether it be the nutrient stress from poor soils, the water stress from growing on a slope or well-drained soils, or nutrient stress from high density planting – these are all deliberate decisions made by vignerons who, over the last 2,000 years, have discovered the best places to cultivate and stress the plant in order to produce delicious fruit. This fruit is the vine’s attempt to escape, through tempting wildlife to eat it and disperse their seeds somewhere less inhospitable. “France would be a forest if untouched and I’m not sure you would not find one wild vine where we have the top vineyards today,” he says. Humbrecht remembers discovering the vines on his own Grand Cru vineyard Rangen de Thann. These vines had been abandoned since World War One. When he arrived 60 years later, most of them had disappeared. The vines that did survive and adapted were producing tiny, small clusters of grapes. Humbrecht believes non-intervention farming would have similar results. “If you don’t prune a vine for 10 years you will end of with tiny clusters, producing maybe 2-4hl/ha – a typical commercial yield in the region is closer to 80hl/ha. Humbrecht’s biggest concern centres around this approach’s commercial viability. And that is important if these methods are to be adopted more globally. If these vineyards’ crops are too small, the vineyard will fail and more likely be bought up by someone else who could return the vineyard to conventional, chemical farming. While there may be disagreements between Humbrecht’s biodynamic approach and Schloegel’s “savage” approach, the permaculture concept has led others to adapt their practices. Michel Chapoutier has been farming biodynamically for the last 30 years but has more recently adopted permaculture. “How I am managing my soil today is completely the opposite to how I managed them biodynamically 20 years ago,” he tells me. Chapoutier now believes the disturbance of the soil is more damaging than the removal of weeds and therefore has stopped ploughing his vineyards. For Humbrecht, light ploughing and resowing cover crops is a better solution. “There is no technique that is 100% good,” he explains. “You have to weigh up the options. What is better? Let the vine die from the competition of the plants growing in May, or disrupting the microorganisms in the soil by ploughing four inches into the soil (between May and June) – you have to choose. It is always a question of balance.” Another producer who has gone beyond organics and placed the development of biodiversity and regenerative practices at the heart of their operation is Gaja. The early success of Piedmont as a fine wine region in Italy saw areas such as Barbaresco and Barolo become dominated by vineyards. Forests were felled and biodiversity dropped. Gaja has since incorporated more trees, adopted permaculture methods in the vineyard and today produce their own organic fertiliser in their historic vineyards. The team has also recently purchased new land in Alta-Langhe where they are not just planting vines, but trees too, incorporating the trees and the vines together. “There is a growing sensibility towards the importance of biodiversity,” says Gaia Gaja, “therefore we are fine with sacrificing space suited for vineyards in favour of trees, we believe in the long run this decision will benefit the health of the vineyards.” Industrial farming is in ecological and financial crisis. More sustainable approaches have to be adopted if we are to survive the next generation, but, so far, those choices come at a cost. For many farmers struggling to make a living, the conventional, chemical farming approach has become the only way to financially survive, taking each year as it comes. These growers can ill afford to think much beyond that, despite the system’s long-term unsustainability. Many feel trapped and find more sustainable approaches economically unviable without better directed government subsidies that promote regenerative farming practices. Wine is hardly an essential food product, but it is the economic engine for entire communities that rely on it for subsistence. In certain wine regions where there is a reliance on water reserves and chemical inputs, it will have to adapt or die. Minimal intervention viticulture is no doubt a radical option, but truly regenerative viticultural approaches will be necessary in a future where food shortages become more widespread. Chapoutier and Zind-Humbrecht, even Schloegel, albeit blessed with great terroir, are paving the way, proving it is possible to produce wine at good volume, at all price points, with a regenerative approach. Agriculture is in crisis. Wine producers are at the forefront of the challenges facing farmers around the world – but what can they do? We talk to Olivier Humbrecht MW, Bruno Schloegel, Michel Chapoutier and Gaia Gaja about rewilding, regenerative farming and the vine’s long-term viability

How viticulture can help the climate crisis

A return to the wild: beyond organics

When it comes to whisky, the conversation has long been dominated by maturation – on how long the liquid spends slumbering in which cask, on how big the cask is and what it held before, whether a Sherry butt, wine barrique, first-fill Bourbon barrel or the fashionable mizunara. Recently, there’s been an increased focus on the base product, with producers such as Waterford’s Mark Reynier championing single-site, single-barley, terroir-driven whiskies (and rums, with his Renegade project). But, somehow, there’s a tendency to skip on by the magic that happens in between: distillation.  While grain whisky is column distilled, malt whisky is almost exclusively distilled in copper pot stills – indeed, it’s a legal requisite for Scotch whisky. Crafting these copper beauties is an art – and one that depends on a handful of specialists. Kentucky has Vendome, Germany has Kothe and CARL, Italy has Frilli and Scotland has Forsyths. The equipment these coppersmiths produce lays the foundation the DNA of its new-make.  To the untrained eye, these onion-shaped pieces of kit look almost identical, but the size and shape is distinct to each distillery – defining its style. As distilleries expand and increase production, they don’t buy a bigger still – but commission exact replicas of their existing still(s), with every dent and dimple carefully recreated. Macallan, famously, replaced all its stills when building its new state-of-the-art distillery in 2018, asking Forsyths to create 36 stills that were identical to those it had previously used.  Although there have been attempts to use other metals, copper has long been favoured for distilling – originally for its pliability, making it easy to work and shape. But by the early 20th century, it was apparent that copper had other benefits – stripping the spirit of impurities. As the vapour rises through the still, it reacts with the copper, capturing sulphur, cyanides, carbonates and acids, meaning the liquid that is eventually collected is purer. Coppersmiths play on this purifying effect to create a range of stills, for the longer the vapour spends in contact with the copper, the lighter the spirit you’ll produce. Take Glenmorangie’s tall, 17-feet-high stills which produce a very light spirit, and compare them to the small, squat stills and typically heavy spirit of the Macallan. Of course it’s not quite as simple as that. As well as the ratio of copper to liquid, the speed of distillation, the shape of the still, the size of the neck, the level of reflux, the angle of the lyne arm and venting of stills all have an impact.  Rothes-based Forsyths has been hammering copper into shape for Scotland’s leading distillers for over 150 years. Richard Forsyth OBE (who has now passed management of the business to his son, Richard Jr) was the third generation of his family to run the coppersmiths. The frank, self-effacing Scot remembers working in his father’s workshop aged 15, “I knew this is what I wanted to do… I found it fascinating.” And after 55 years, his eye still twinkles when he talks about the arch of a still’s swan neck, the art of wielding a planishing hammer and the characters that make the industry so interesting.   He joined the family business in 1967 – at what happened to be a pivotal moment for the industry. During the Second World War, the whisky business ground to a halt – and with it the need for stills. In the 1950s and ’60s, however, the industry grew rapidly – too rapidly, it turned out. What was a golden era turned into a whisky lake, with many distilleries soon mothballed. Forsyths – for whom 99% of its business was servicing the whisky industry – had to find something else to pay the bills, and it was up to Richard to find that something else. They branched out first into paper, then stainless steel and – by the late 1990s – oil and gas. Although coppersmithing remained the foundation and heart of the business, these other disciplines became the main money-makers until the early 2010s, when whisky’s current boomtime set in. Today, Forsyths maintains over half of the pot stills in Scotland. For a wash still (distilleries that double-distil have wash and spirits stills, first distilling the wash into “low wines” and then distilling the “low wines” into new-make spirit), the head, neck and condenser wears out in eight to 10 years, while the pot itself may last 25. Add to that developing new stills for the thriving industry – as well as their expansion into rum, Bourbon and tequila – and the company’s not short of work.   Although there is clear resistance to change with an industry that is entrenched in tradition, things have shifted, slowly but surely, over the years. And there have been two significant changes over the last century that have transformed the Scotch whisky world: the firing of stills and the nature of condensers.  When shell-and-tube condensers were invented in the 1880s, as an alternative to old-fashioned worm tubs, it took time for producers to be persuaded. Although shell-and-tube condensers are significantly more efficient and take up much less space, they are completely different – with the copper surface area at least 20 times larger, something which has a key impact on the spirit. To this day some producers (15 to be exact – including Craigellachie, Mortlach, Glen Elgin and Springbank, the latter only for their wash still) retain their worm tubs, valuing the heavier, richer, more complex (and in some instances, even meaty, savoury) spirit character.   Traditionally stills were direct-fired – heated by flames fed by peat, coal or gas. “It’s dirty, messy, difficult to handle – and to control,” Forsyth tells me. A push for safety and efficiency saw producers switch to using steam in the 1970s. But some argue that this shift wasn’t for the better. Fire created a less consistent heat, with hot spots that would burn the wash and promote Maillard reactions (the same reaction that takes place when you brown meat, or during the bottle-ageing of Champagne or other traditional-method sparkling wine) – adding nutty, roasted notes that build complexity, or so proponents would argue. Glenfarclas is known for having briefly dallied with steam before returning to direct-firing, along with the likes of Macallan, Glenfiddich and Springbank.  As the whiskies of this pre-modernisation era – Scotch’s so-called “golden age” – become increasingly coveted, distilleries (both new and old) are looking to recreate these practices. Along with traditional floor maltings, producers like Glen Garioch (owned by Suntory) and Dunphail are investing in direct-firing. (Although, with worm tubs no longer produced, new distilleries have little choice regarding shell-and-tube condensers.)  However they are fired, given their custom nature, copper pot stills don’t come cheap. Much of the work continues to be done by hand, hammering to strengthen and finish the copper. Stills can range from 5,000 to 50,000 litres in capacity, but an average 15,000-litre still and its condenser will require between 1,800 and 2,000 manhours, and set you back around £250,000. And that price has only increased recently, thanks to rising energy and material costs – with a copper shortage proving challenging for Forsyths, a business that is the UK’s second-biggest buyer of the metal.  With the distinct nature of stills and their impact on spirit, plenty of new producers will ask for copies of a particular distillery’s stills – wishing to emanate their style of spirit. Forsyth tells me how one Japanese customer requested a pair each of Macallan, Glenlivet and Glenrothes stills. While of course there are many problems with this imitation game, there’s also no guarantee – as Forsyth tells me – that the same equipment will have the same results, especially when not run with the same wash, in the same way, by the same people. And, of course, a company like Forsyths isn’t going to give away Macallan’s proprietary designs, for example. As such, they’ll recreate something similar, but ensure it’s tweaked so no two distilleries have exactly the same design.   But how much impact do stills really have on the final spirit? Despite his half-century in the trade, Forsyth is quick to suggest, “I don’t think a lowly coppersmith can talk too much about that.” He’s clear that you need good equipment to make good spirit, but it’s one factor in amongst everything else – the barley, water and fermentation times, for example. And how a still is used is as important as its shape or size, with both the speed of distillation and the all-important cuts – dividing the heart from the foreshots and feints. Forsyth firmly believes that good wood is “the single biggest effect in a bottle eight, 10 or 12 years later”. There’s little use having a good base spirit if it’s ruined by a decade in bad oak – but good oak also can’t salvage bad spirit.  Forsyth has seen it all during his 55 years in the whisky business – and has been forced to be as malleable as the metal his family has worked for generations to survive the booms and busts. Despite the challenges, the coppersmith is as enchanted by his trade as when he first picked up a hammer in his father’s workshop. The industry will doubtless continue to ebb and flow, but with a spirit that takes decades to produce, the pace of change is reassuringly gentle. “It almost goes as slow as the running of the spirit,” Forsyth says whimsically. At the time of the latest vintage release from Burgundy, it is always the year’s conditions that dominate debate. But is it really the most important factor when it comes to identifying what wine to buy? The best winemakers reliably produce magnificent wines year in, year out. The variation in vintage for these wines is fun and nuanced, rather than the death knell over the success or failure of a vintage. Unless the vintage is a complete disaster, which these days is rarely the case, vintage conditions are not the greatest indicator of the success or failure of a producer’s wines. More important are the techniques vignerons adopt, which in turn affect the style and balance of their wines. All viticulture and winemaking is a multitude of decisions, hundreds possibly thousands of them that collectively combine to produce the wine of that vintage. While modest vignerons might say the wines make themselves, and the best often aim to interfere as little as possible, even choosing not to do something is a conscious decision that requires serious experience and know-how. Burgundy of all places involves plenty of winemaking decisions that greatly affect the final outcome in bottle – particularly with the red wines. The fragile Pinot Noir is hugely susceptible to affectation during the winemaking process. The wines are certainly less
manipulated today than they were in the past. Nightmarish stories of copious amounts of fertiliser and insecticide polluting the soils, along with formulaic additions of sugar at fermentation are fortunately no longer normal practice with top producers today. In the recent past, red Burgundy also had to deal with over-extraction during fermentation and high levels of new oak in élevage, that arguably had the biggest effect on the flavour profile of Pinot in the 1990s and 2000s. But today, with extractions kept pretty minimal and oak – for the most part – more deftly used, Burgundian Pinot Noir is very much in an era of
transparency. Today, distinct winemaking techniques, like whether or not the winemaker incorporates whole bunches into the fermentation, determine distinct styles in red Burgundy. From the likes of Domaine de la Romanée-Conti and Leroy – who use high proportions of whole-bunch in their fermentations, to Rousseau and Fourrier at the other end of the scale de-stemming everything: to whole-bunch ferment or not is a decision that splits Burgundy’s top winemakers right down the middle. Both decisions are attempts at authenticity. For the vignerons who completely de-stem their wines, it is the purity of fruit that best transmits the terroir expression of the vineyard. Any incorporation of the stems only detracts from the fruit clarity and flavour – a flavour determined by its terroir. This philosophy is difficult to deny and, when tasting fully de-stemmed wines, they do tend to be most consistent in character and certainly transmit the nuances of a vineyard. For the “whole-bunchers”, the authenticity lies in it being the traditional method, arguing that whole-bunch fermentation was how all wine was made prior to the invention of the de-stemmer in the mid-20th century. While this isn’t strictly true, whole-bunch fermentation
was certainly normal practice and is how wine has been made for millennia. True terroir expression for them is not just the berries, but the stems too; it is both the stems and the berries together that offer the true blueprint of the terroir of a site. In the middle sits a growing majority of producers who see the advantage of both methods, without the need to sit in either camp. Partial whole-bunch fermentation adds something interesting to the blend without overpowering the purity of the fruit. These wines can therefore be both complex and terroir transparent, while not being at either extreme – representing a preference for balance over anything else.  Today many vignerons remain wary of having too many stems in the blend and its negative effect on acidity. Chantal Tortochot currently opts for around 20 to 25% whole-bunch during fermentation depending on the vintage. Too much, she believes, will have a detrimental effect on the freshness of the wine, because the stems introduce three important elements to the wine: water, potassium and mineral salts. Her biggest concern lies with the potassium, which – when mixed with the tartaric acid of the wine – precipitates into potassium carbonate crystals that then drop out of the wine, reducing the overall level of acidity in the wine. However, the countering effect of using whole-bunches in the fermentation is that the mineral salts provide a salinity and sapidity to the wine which actually makes the mouth water, accentuating the sense of freshness in the wine, even if the acidity is lower. Two therefore contrasting examples of the effects of whole bunch: does it make the wine more refreshing or less? On tasting the latest vintages on release, it has become apparent that while not always the case, wines made with a high proportion of whole-bunch tend to be less consistent when tasted in their youth. Not only can the wine aromas be dominated by stemmy notes, the wines can often be shut down. Again, this is not necessarily down to the quantity of whole-bunch, but it does seem to be a recurring trend when tasting wines that have a high proportion of whole-bunch. David Duband, a great believer in whole-bunch, accepts that in their youth the advantages of incorporating whole-cluster fermentation is less obvious, but after about eight years in bottle, he believes this method produces wines of higher complexity than those from the same appellation that have been completely de-stemmed: “They have some extra life on the palate,” he explains.  Having evolved from a winemaking philosophy which saw him de-stem all his fruit prior to 2006, he recognises the difference between the two approaches better than most. Others are less convinced. Charles van Canneyt of Domaine Hudelot-Noëllat has experimented using whole-bunch over the years but personally never found it added anything positive to his wines and remains a strong advocate of de-stemming all his grapes prior to fermentation. If anything, he believes partial whole-bunch fermentation can add flavour complexity to simpler, earlier-drinking wines that lack the natural depth of fruit. Philippe Jouan believes that the decision on whether or not to use whole-bunch should depend on the vintage. For him, in sunny vintages, the stemmy, “sauvage” flavours you get from whole-bunch fermentation are not in keeping with the vintage style: “It contests too much with the sunny fruit flavours,” he says. He will therefore only use stems in cooler vintages. Florence Heresztyn-Mazzini at Domaine Heresztyn-Mazzini has the opposite approach. She believes the warmer, riper the vintage, the better the stems are lignified; therefore, rather than adding greenness to the wines, they bring complementary flavour complexity.  For Olivier Bernstein – who incorporates 50% whole-bunch into his wines – it brings aromatic complexity, structure, and expression. For him, “The delicacy of the impact of whole-bunch on the final flavour is all to do with the quality of the fruit.” And this does seem to be an important point: when done well, whole-bunch fermentation is not something that is always obvious. The aromatic complexity is so integrated with the fruit, the perfume of Pinot still dominates both the nose and palate. 

Whichever philosophy a vigneron chooses, there is healthy debate in Burgundy today over whether or not to use whole-bunch fermentation. It is just an extra nuance, adding another layer of intrigue to this fascinating fine wine region. The success of each of these different
approaches shows there is no right answer, but it does make you wonder whether winemaking styles should be playing more of a role when deciding which Burgundies to buy – and whether vintage is as important as we traditionally believe it to be.   De-stemmed versus whole-bunch wine-making: 2019 CHAMBOLLE-MUSIGNY, PREMIER CRU, LES CHARMES, REMOISSENET PÈRE & FILS Remoissenet has a very particular style – one that is all about achieving great purity, and with 100% de-stemmed fruit. They have no qualms about harvesting late, often being some of the last to pick, believing what they lose in quantity through evaporation, they gain in quality through natural concentration. The fruit is de-stemmed, with an extended cold soak and fermentation in open-top vats at cool temperatures.  This approach has given their 2019 Chambolle Les Charmes a textbook enticing floral lift, with additional redcurrant coulis and lavender notes. There is a lovely freshness to the palate, with crisp red berry and red cherry fruit. It’s concentrated, yet so vivid and bright in the mouth – as is typical of the appellation. There’s a sappiness and dark chocolate note on the finish, the latter from the oak (50% new) which needs time for further integration, but this wine has great balance and a good amount of dense, textural extract. It will be beautiful at maturity in 10 years and beyond. 2019 MOREY-SAINT-DENIS, PREMIER CRU, LES MILLANDES, DOMAINE HERESZTYN-MAZZINI This is really quite a contrast to the Remoissenet. Not only are the appellations completely different, but so is the winemaking. In 2019 Heresztyn-Mazzini’s Millandes is 100% whole-bunch fermented. The nose is full of wild flowers, earthy soil and light stemmy notes. There is a wonderful “small berry” concentration in the fruit on the palate (black cherry, blackberry) but there are also lots of crunchy mineral rock notes and a salty tang.  The tannins build on the palate, austere and incredibly structural; this is tannic Pinot Noir. The complexity in flavour, structure and aromas (no doubt increased by the effects of the whole-bunch fermentation) requires some time to fully integrate. Highly complex and concentrated, it will be fascinating to taste this again in 10 years' time, especially next to Remoissenet's Charmes. Discover Burgundy

BURGUNDY 2021: THE GROWING SEASON After three warm years, 2021 marked a return to the sort of weather traditionally associated with Burgundy – and all its challenges.  The winter was warm and wet – “too warm”, Frédéric Weber at Bouchard told us. He remembers finishing pruning in just a t-shirt in March. The vines started growing enthusiastically, with early budbreak, only to be struck by a cold spell at the beginning of April – as frost struck the whole of France. The nights of 6th, 7th and 8th April were devastating, especially 7th. Temperatures dropped to -8˚C in places – temperatures at which candles, helicopters and wine machines could offer little help.  
Images of the Côte de Beaune littered with a milky way of candles filled social media, and vignerons could do little but pray. For the early-budding Chardonnay, 80% losses were normal, with some producers in Chablis losing everything. The humid conditions, with snow falling, made matters worse – unusually this combination means that lower-lying village sites were less impacted than the Grands Crus (higher up-slope, where more snow fell). Indeed, if producers had lit candles (or “bougies”), the warmth melted the snow, which then froze and the buds were burnt by the morning sun – cruel retribution for trying to protect their livelihood. This severe, black frost (“le gel advectif”, as Florence Heresztyn explained) was savage – caused by a mass of cold air from Siberia. Chardonnay (and therefore especially the Côte de Beaune) was impacted more, as were any earlier-ripening Pinot Noir sites, such as Cazetiers or Combe au Moine. Candles can normally only increase the temperature by 2˚C, however some producers noted how a collective effort could make a difference – with a high-density of candles concentrated on an area. Erwan Faiveley had installed electric wires in their Bâtard-Montrachet and Bienvenue-Bâtard-Montrachet, as used previously in Chablis, which saved their crop in these plots, but other parcels were devastated. As Thibault Gagey of Louis Jadot noted, late pruning could help; one of their long-term growers in Bâtard-Montrachet pruned late and got a better crop, but the damage was still significant. David Duband reported how he also had issues in April with caterpillars which munched on the nascent buds. He had to hire five additional workers for a week to battle their hungry attack. The cold weather continued, with May cold and cloudy. Flowering at Bouchard began on 16th June, in wet and mild conditions that were perfect for oidium (powdery mildew) and downy mildew. Because the weather was so wet, mud prevented tractor access and at Bouchard they hired more people to spray by hand – a luxury not everyone could afford. Producers across the region spent their weekends during the summer spraying their vines when they could, with the disease pressure a particular challenge to anyone working organically or biodynamically. Edouard Confuron estimated he had sprayed four or five times more than in a normal year. There was some localised hail, with a storm in June causing damage in the north of Gevrey-Chambertin, especially in Les Champeaux, said Pierre Duroché and Olivier Bernstein.  
With the wet and cooler conditions, deleafing was important to open up the canopy, reducing disease pressure and exposing the fruit to much-needed sunshine. At Olivier Bernstein, Richard Séguin explained how they deleafed the fruiting zone and kept just one or two bunches per vine, removing any green bunches that remained at mid-véraison.  September saved the vintage, with warm, sunny and mostly dry conditions. With the tiny volumes, this was enough to ripen the fruit – Jacques Devauges at Domaine des Lambrays described it as Mother Nature evening the score, making up for what she’d taken in April.  Harvest dates varied quite significantly – starting from 10th September through to early October. Rain fell on 19th and 20th September, and producers were often divided between picking before and after this date. Generally producers started with Pinot Noir, then moved onto the Chardonnay, and dates were around a month later than in 2020. Jean-Marie Fourrier felt it was important to wait for phenolic maturity – which only arrived after the rain, and Erwan Faiveley argued that it was essential to wait for the dilution from the rain to pass before picking. Given the low yields, the harvest was often shorter – simply because there wasn’t much fruit.  Selection was essential – making a small crop even smaller – but there was some beautiful fruit of both colours. Yields varied, with losses between 50 and 80% – and some parcels (especially of Chardonnay) were blended together due to the tiny volumes at play. BURGUNDY 2021: THE WHITE WINES 
There’s no doubt amongst producers – or tasters – that this is an excellent vintage for Chardonnay. Production levels are laughable – with often the lowest yields they’ve ever seen, at a mere 20% of their normal crop – but the quality goes some small way to making up for the loss. The small crop (reduced by the harsh April frost) had a long season to slowly ripen, developing intense levels of concentration, yet – with cooler conditions than 2018, 2019 or 2020 – retaining amazing freshness and acidity. With the wet summer, disease was an issue: Erwan Faiveley described oidium as “exploding” on the Chardonnay (with levels not seen since 2004). Extensive sorting was essential. He also felt it was necessary to fine with bentonite after pressing to ensure the must was clean; similarly at Bouchard, Frédéric Weber didn’t use the very first free-run and inoculated fermentations this year to ensure they ran smoothly. Others, such as Philippe Abadie at Alvina Pernot and Paul Pernot, emphasised how important it was not to over-press. Most wines were chaptalised this year, often just to bring up 0.5%, with the final alcohol levels sitting between 12.5 and 13.5%.  Guillaume Boillot at Henri Boillot – who has produced a stunning range of wines – describes the whites as “salin”, having “belle matière”. Vibrant and pure, these are tightly wound with cool, white-fleshed fruit character, sometimes with tropical richness, often a mineral, saline thread and piercing acidity.  Due to the tiny volumes produced, oak usage varies this year. Boillot used none, but others have slightly more in the blend – feeling it didn’t need the freshness added by components aged in stainless steel. For Jadot, it was the first year that they used exclusively foudres, the larger barrels reducing the flavour impact of oak on the wine. Erwan Faiveley believes that tasting the whites, you can feel “the struggle in them”, that the vines suffered. Tasting through the exceptional Grands Crus he’s produced, however, it’s hard to see this – and perhaps he’s biased by the challenges of working the vines and crafting the wines in 2021. Comparisons are hard for such a unique year, but 2014 and 2017 were common themes, largely due to the high acidity, quality and ageing potential. Philippe Abadie and Alvina Pernot described it as “classic bourguignon”, while Thibault Gagey at Louis Jadot compared the year to 2011 or 2013, although feels the wines are better than those of the latter vintage. Faiveley points to 2007 – a vintage that has never shut down or, for him, disappointed; for Boillot they’re closest to 2016, but more precise. At Bouchard, Weber is so excited by their potential that he plans to keep them in barrel longer – possibly bottling in July 2023. These are really exciting wines – with a vibrancy and energy that is compelling. The cool and mineral classicism here, with great fruit concentration and balance, should age beautifully.

 BURGUNDY 2021: THE RED WINES 
While there is a clear consensus on the 2021 whites, the reds are more varied in the vintage – but much better than we initially thought. The wines have clearly benefited from additional time in barrel, and most addresses have crafted a flight of elegant, pale-coloured and light-bodied Pinot Noirs. Although there are a few, rare examples of dilute or overly lean wines, this is in the main a return to “old school” Burgundy, with wines of perfume rather than power. The volumes are more generous than for the Chardonnay, but still measly, mostly sitting between 30 and 50% of a normal year’s yield. 
Frédéric Weber at Bouchard felt there were two styles of Pinot Noir in 2021: those from plots not damaged by frost, with normal yields but grapes with thin, fragile skins, prone to grey rot. The fruit from frost-hit sites, meanwhile, came with lower yields, thicker skins and less disease – for the latter he preferred to harvest later, with their higher tannin levels.  
Jean-Marie Fourrier noted that the picking date for Pinot Noir was key, worrying that anyone harvesting before the rain on 19th/20th was playing a risky game when it came to phenolic maturity and might have unripe tannins and vegetal notes.  
In general, Florence Heresztyn of Heresztyn-Mazzini felt it was a vintage, like 2012 or 2013, where producers needed to be attentive and precise at every stage – from the vineyard to winery. Sorting was essential and almost every producer chaptalised – largely used to prolong the alcohol fermentation rather than with the sole purpose of increasing the alcohol level. 

 Beyond this, tactics in the winery were varied – with vignerons often taking opposite approaches. Some producers, such as Bouchard, opted for more whole-bunch fermentation. Winemaker Frédéric Weber explained that the stems were so beautiful that he was happy to include 30-50% on average; the potassium also helped reduce the acidity of the wines, giving – he felt – a better expression of the year. 
The opposite was true of many, including Benoît Stehly at Georges Lignier and Hugues Pavelot. At Olivier Bernstein, the team used 30-40%, much less than in a warmer vintage, as they didn’t feel additional freshness was required, nor were the stems sufficiently lignified; similarly Heresztyn-Mazzini used 30-60% rather than 50-100% to avoid any greenness. While Jean-Marie Fourrier de-stems everything, in 2019 and 2020 he added the stems back into ferments for freshness, but didn’t feel it was necessary in 2021. 
When it came to extraction, the approach was similarly broad. Some felt it was a year to be more delicate, others thought it was a year that required more work to extract the colour and tannin that was in the grapes.  
Maxime Cheurlin at Domaine Georges Noëllat used a warmer – and therefore shorter – fermentation (sustaining 33-34˚C, versus 31˚C normally) to build the mid-palate of the wines. Charles van Canneyt had to buy smaller tanks for the miniscule yields, but the tiny tanks therefore fermented more quickly and he was careful to keep maceration short to avoid risking over-extraction. Similarly, Olivier Bernstein was keen to keep the fermentation short, with a five-day cold soak to extract colour and aromatics, then just 13 additional days on skins before the must was pressed – the fermentation finishing off the skins. 
By contrast, Fourrier opted for more extraction to get everything possible from the fruit. Guillaume Boillot echoed this view, with an additional week of skin contact. He used just pumping over rather than punching down to focus on fruit and aromatics rather than tannin; but at Faiveley, Erwan used more punching down than pumping over. 
Some producers highlighted that the grapes had high levels of malic acid (which has been notably low in recent, solar vintages), meaning that malolactic fermentation had a significant impact on the wines. Both Benoît Stehly and Charles van Canneyt noted how they were verging on severe at first, but after malolactic were open and fruity – totally changing in style. On paper, the pH is quite high for some wines (up to 3.7) – yet there is plenty of freshness, the lighter body and lower alcohol (mostly 13-13.5%) perhaps balancing it out.  
For élevage, some winemakers feel the wines need longer or shorter élevage, or different types of oak, with more or less new or different toasting. Nicolas Potel at Domaine and Maison Roche de Bellene feels that the crunchy character of the Pinot Noir will only be enhanced by a longer maturation in barrel (planning for 24 months versus the normal 12). Boillot opted for no new oak (as for his whites), feeling it would mark the fruit too much; while Maxime Cheurlin used less new oak but higher toast levels to add further complexity – and plans to bottle the wines earlier.  For Domaine Joblot, they felt that more new oak helped round out the lighter wines, using 50% new. At Domaine des Lambrays, Jacques Devauges favoured a slow, gentle toast – a "chauffe blonde" that gives the scent of freshly baked bread. Indeed, Devauges feels the wines have been improving significantly in barrel, offering more concentration and aromatics with each month that passes – something that reminds him of the 2010 vintage. 




Frédéric Weber at Bouchard describes 2021 as “charming”, comparing the wines to those of 2017, with good terroir definition and balance at 13-13.5% – more in line with what used to be “normal” for the region.  Thibault Gagey at Jadot pointed to 2004, 2013 or 2017 as possible similar vintages, but finds it hard to compare – it’s old school but approachable. Marion Raphet added 2014 into the mix, and although the wines are incredibly open now, wonders if they might shut down in bottle. For her, however, it is a year where, “On retrouve la typicité” (they rediscovered Burgundy’s typicity). The team at Tortochot pointed to 2011 or 2001, while Erwan Faiveley looked to 2007 and Florence Heresztyn noted the growing season was reminiscent of 2016.  
Maxime Chuerlin looks further back, feeling it has a similar equilibrium, colour and density to the outstanding 1991 vintage – in no doubt that the balance of the wines will allow them to age. While it’s easy to assume that these paler Burgundies might not be the longest-lived, almost every producer anticipates that 2021 will surprise everyone with its ageability – especially for the top wines. 
Almost every single grower we spoke to used a different approach for the 2021 vintage – but almost all have succeeded, producing vibrant, open and pretty Pinot Noir. It is a year in which careful vignerons could craft exceptional wines that were both light-bodied, yet persistent – with a purity and intensity that is surprising, along with captivating aromatics. As Nicole Lamarche said, “You can have both lightness and concentration.” It is, overall, a year that has surpassed expectations – one that was transformed by producers’ dedication, work in the vineyard, and modern technology and know-how in the winery.

Burgundy 2021: a wine-grower’s vintage

Reports coming in last summer of the long drought that hit Burgundy had many writing off the vintage before it had even been picked. What then turned out to be the earliest harvest on record did nothing to calm those concerns. Many of the vignerons themselves were concerned about how the wines from this unique growing season would turn out. Preceding one of the most challenging seasons in the region’s history (2021 being beset with frost, rain, disease… you name it, it happened), everyone is looking back at 2020 and wondering what they were worried about. It is abundantly clear that 2020 produced some magnificent wines, with exceptional balance, freshness and full fruit maturity, yet that also remain very Burgundian in style. There is very little not to like. How it happened is a lot less clear, but we heard plenty of theories, that – while not completely consistent – go at least some way to explaining the vintage. While the vignerons don’t know for sure why the wines turned out the way they did, how they got there is by the by: these are extraordinary wines. Tasting the vintage While we tasted as many wines as we could up and down the Côte d’Or and beyond, due to the complications of the late 2021 vintage, some vignerons were still busy finishing off the harvest when we visited. The late harvest has also impacted the timing of winery work, delaying the racking process, meaning some of the wines weren’t able to be tasted or were in a slightly awkward place. While the breadth of tastings was therefore a little more limited than usual (with more analysis to follow), we still came away with a good hold on the vintage. On the whole, the wines we did taste were brilliant both in white and red, with a little more consistency among the whites. Pinot Noir struggled more with the drought, while the Chardonnay seemed almost unaffected. Despite the early harvest and slightly contracted growing season, both the whites and reds we tasted were fully phenolically mature. Even though the vines shut down due to the heat, there was no evidence of greenness at all. Some vignerons kept to the traditional 100 days between flowering and harvest – others were down to as little as 90-95 days, with some believing this to be the “new normal”. Benoît Stehly, winemaker at Domaine Georges Lignier believes that 2020’s drought had the same effect on the grapes you get when fruit is dried. “A dried apricot is both sugary and rich in acidity,” he says. “The dehydration of the berries concentrated the sugar,  flavour,  fruit and the acidity. It is the reason why the freshness of the 2020s is so good.” He contrasts it with 2018, another “hot vintage” but with more summer rain. “The alcohols were high and the acidity low in 2018 because the vines never shut down.” Bouchard’s Frédéric Weber echoed this. “The grapes’ maturity was stopped by the drought,  but this was positive, as there is greater natural acidity and natural freshness to the wines.” The expanded range at Alvina Pernot in 2020, a range of taut and mineral Chardonnays The whites The white wines we tasted were exceptional – with fantastic balance, great acidity and wonderful concentration, but moderate alcohol levels, when compared to the more exuberant 2019 and 2018 whites. So many vignerons were keen to point out the low pH levels and very high concentration of tartaric acid – reminiscent of the 2014s, but these wines have so much more flesh too, making them easy to enjoy already. They are less skinny and austere than the 2014s, yet have the energy and equilibrium to age beautifully. What is not to like? Guillaume Boillot at Henri Boillot highlighted the salinity and dry extract in the whites, making them “hyper dynamic and balanced”. He noted that the acidity is thanks to the vines shutting down – something which only happened to the Chardonnay. Frédéric Weber explained that the Chardonnay resisted the heat better, having very high tartaric levels and a pH that is the lowest since 2014 (at 3.1-3.2), creating classic wines. “The balance is perfect,” he said. As Olivier Lamy (Domaine Hubert Lamy) and Francine Picard (Au Pied du Mont Chauve) pointed out, the picking date was key for the whites, as the grapes were ripening very quickly – gaining around 1% potential alcohol in just two days. From our tastings, however, everyone seemed to get this right. Producers were particularly happy to have full cellars when it came to whites – with many coming close to the legal maximum in terms of production. Michel Pernot (Domaine Paul Pernot) feels that the generous yield was key to the fruit not being over-ripe, adding that in 2003 the yield was half of that in 2020 – and therefore overly concentrated and cooked. For Michel's daughter Alvina Pernot, it’s the best vintage she and her husband Philippe Abadie have made to date. Michel echoes the sentiment, saying it was simply “magnifique”. From what we’ve tasted, they’re excellent: vibrant wines that are a little more generous than 2014, but with brilliant precision and ageing potential. Amongst the vines in Chambertin Clos de Bèze The reds The variation in picking times for Pinot Noir emphasised how different parcels matured differently – whether due to microclimate, location, rootstock or access to water. It accentuated just how varied Burgundy’s landscape is, as well as vignerons’ own tastes. Charles van Canneyt (Domaine Hudelot-Noëllat) remarked that people were picking Pinot in the same vineyard up to a month apart. With moderate alcohol levels from all but a few producers, it certainly wasn’t racing sugar levels that forced an early harvest, but that the season started early and stayed so right through to harvest. It was down to the vignerons to dictate the style of their wines. In the Côte de Nuits, there were local rain showers in early August which Erwan Faiveley believes favoured the Pinot Noir particularly in Nuits-Saint-Georges, Chambolle-Musigny and Vosne-Romanée. This rain in early August, he believes, not only refreshed the vines but stopped the vines shutting down – helping with the phenolic development of the grapes and increasing the sugar levels, which resulted in higher alcohols, concentration and added freshness. Others around Vosne and Chambolle were grateful for a later rain shower on 28th August, which Lamarche, Hudelot-Noëllat, Gros Frère & Soeur and Georges Noëllat all believed was essential in pushing the grapes through to full phenolic maturity and providing the wines with added finesse. Again, the proof was in the pudding and the wines from Georges Noëllat, Hudelot-Noëllat and Lamarche were easily some of the finest we tasted. Up in Gevrey-Chambertin and Morey-Saint-Denis, the likes of Duroché, Tortochot, Georges Lignier and Domaine des Lambrays all chose to pick before the rain. Again, there was no concern here regarding greenness, with exceptional fruit concentration and clarity. Pierre Duroché believes his 2020s to be the densest wines he has ever made, but balanced with amazing acidity. It is certainly an exciting line-up. All in all, there’s more of a range in styles among the reds. In general, the fruit sits more in the red than black spectrum, bright and crunchy, with vibrant acidity and alcohol levels that tend to be closer to 13-13.5% (around 1% less than 2019 in many places). As Charles van Canneyt noted, it’s more classic than 2018 or ’19, while Nicole Lamarche praised the finesse and elegance of the year – something that certainly comes through in her wines. Producers are divided as to whether they prefer 2020 or 2019, although the majority consider 2020 the greater year. David Duband describes it as “fresher, straighter, more serious” than 2019, while Nicolas Potel (Domaine de Bellene) thinks it’s easily in the top five vintages he’s ever made, and will prove more homogenous than its predecessor. Cyril Audoin in Marsannay and Nicolas Potel both highlighted that it was a vintage that will always be open. While undoubtedly the wines have everything needed for cellar ageing – beautiful balance, silky tannins, vibrant acidity and the necessary concentration – they are already very appealing, and seem unlikely to shut down in bottle. So, how did producers adapt to the year in the winery? Guillaume Boillot said it was “easy” – and he wasn’t alone, especially in the wake of 2021. Due to the year’s dry conditions, the fruit was so healthy that vignerons didn’t even need to use a sorting table. Because the fruit was harvested in such hot temperatures though, many highlighted the need to pick only in the mornings and in some instances to chill the fruit overnight (as is commonplace in the New World, and becoming more so in Burgundy). Whether or not to use whole-bunch fermentation divided Pinot Noir producers (again). For some producers – such as Duband, Domaine de la Romanée-Conti and Dujac – whole-bunch is part of their style, and will use a high proportion every year. For others, there is debate. Cyril Audoin de-stemmed everything, feeling that the ripening season was too short in 2020 to allow for full lignification (ripening of the stems). Erwan Faiveley agreed, noting that the way maturity was blocked in the height of summer prevented the stems lignifying. On the other side of the argument, vignerons such as Benoît Stehly at Georges Lignier saw lignification in the stems as early as July and had no concern using them in the blend to add complexity. Even domaines known for not using stems – such as Fourrier – used up to 20% in their blends in 2020. For Fourrier, the aim was to absorb colour and tannin, and add a sense of freshness. The lower alcohol levels made the vinifications generally easy to manage, however the high level of tannin in the Pinot Noir required special care – with many, as for 2019, looking to extract more gently. Frédéric Weber at Bouchard reduced the maceration time to compensate, while Charles van Canneyt opted for more pump-overs than punch-downs. The natural concentration in the berries saw Domaine Georges Noëllat’s Maxime Cheurlin do everything he could to “make the wines thinner”. This meant a 10-12 day cold soak, less extraction and cooler fermentation temperatures (with a maximum 29˚C) – fortunately it worked and the wines remain remarkably ethereal. Vintage comparisons Many vignerons struggled to find a direct comparison for 2020. While the growing season is closest in character to 2003, there is almost universal agreement that the wines (both Chardonnay and Pinot Noir) taste nothing like the ’03s. The whites’ tartaric acid and pH levels make a nice comparison with 2014 but they have so much more richness too, which brings added impact. Frédéric Weber notes how despite the warmness of the year, there is tremendous terroir transparency from one vineyard to the next – a real signal for him of a great vintage. In this respect it resembles 2016, but with added concentration. “The Pinots from 2017 and 2019 are soft, aromatic, round and warm in the mouth,” he says, “but the 2020s and 2016s have tension, brightness and are full of energy.” Several noted the similarity in fruit clarity to 2015, but with added freshness. While some compare it to 1947, Nicolas Potel – a man with an encyclopedic knowledge of Burgundy vintages – finds it closer to 1966, with a little 2019. “Big, but with great balance,” he explains. While there’s no obvious precedent, producers agree that the wines have great ageing potential thanks to the rich tannins and high acidity levels. Yields and pricing While Chardonnay didn’t fare too badly in 2020 (making white winemakers in the Côte de Beaune particularly happy), Pinot Noir did suffer in the drought. Yields are therefore reduced by up to 40%, depending on the domaine. Of course, this seems like nothing to producers after the just-picked 2021 – where producers have been able to salvage as little as 20% of a normal crop. This does mean that most wines will be increasing in price this year, with around 10-30% estimated. With so little wine made in 2021, however, and the exceptional quality of 2020, this is a vintage that is hard to miss.
