It will likely come as no surprise that our team entered en primeur week this year with a certain degree of trepidation. Ever since the 2023 growing season ended, the general press surrounding the vintage has largely focussed on the negative; absorbed with the struggles faced by the vignerons rather than the highlights. Bordeaux-bashing is a facile yet favourite pastime for some, and this has led to some collectors and even merchants pre-emptively dismissing the vintage out of hand – before the wines have even been tasted. The Bordeaux marketing machine, it must be said, should take its share of culpability for this attitude. Too often the hype surrounding solar vintages, with phrases such as “best ever” practically shouted from the rooftops, leaves both the press and collectors thinking that anything less than a string of superlatives means the new vintage is a dud. There is no room for middle ground or a happy medium. Enter 2023. We started our week in Saint-Estèphe – historically a tough place to make truly great wine in any but the most relaxed growing season. Starting with Calon Ségur, making our way through the range, culminating with the Grand Vin, it gradually dawned on us that these wines aren’t just good, aren’t just classic; they’re something else entirely. Our next visit, at Montrose, cemented this. It is certainly one of the vintage’s highlights and confirmed beyond any doubt that it was absolutely possible to make exceptional wine in 2023. Our full vintage report, due next week, will cover the ins and outs in more detail, but suffice to say that through our tastings across the Left Bank we found plenty to get excited about. A vintage in which Cabernet Sauvignon took the fore (at many châteaux it represents the highest ever proportion of the final blend), fans of Pauillac, Margaux, Saint-Julien et alia will find a great deal to like in the classical freshness of dark-berry fruit, spice, graphite and cedar aromas. In the best wines, this is balanced by a more modern palate of suave tannins, depth of flavour and elegant but plush-textured bodies, donated by the (largely unreported) warmth of the growing season. As for the Right Bank – having lived and worked in Saint-Emilion in my 20s, entering the town always feels a little like homecoming for me, but this year it was tinged with foreboding. Merlot had struggled on the Left Bank, and we were concerned as to what we would find on the other side of the river, where it is the dominant grape. I was therefore relieved and frankly delighted to discover that our fears were largely baseless. Throughout our tastings across properties in Pomerol and a few in Saint-Emilion (several of our team remain in Bordeaux and will visit more châteaux here on Monday), we actually found a higher level of homogeneity than on the Left Bank. Some strikingly beautiful wines have been made. Characterised by delicate floral and mineral aromatics, sensual tannins and pure, precise flavours, terroir really shone through in 2023. Many of the absolute highlights of the vintage can be found here – I left Cheval Blanc wondering which kidney I could sell in order to get my hands on some (a moot question as after 15-plus years in the industry, nobody would pay money for my kidneys). Lafleur was so special I don’t want to sully it with hyperbole. Anyone who tells you there were no great wines made in 2023 didn’t put in the effort to travel to the region and taste properly – it’s as simple as that. As to the market, there is no getting away from the fact that conditions are tough. Through our extensive conversations with the châteaux, we are relieved to confirm that they are well aware of this, and it is now all but confirmed that action will be taken in the form of significant price reductions. As was the case with the 2019 vintage, this is an exciting prospect for Bordeaux lovers. William Kelley neatly summarises this in his report, released just two days ago: “Word in Bordeaux was that the 2023s would be released at significantly lower prices than the region’s last three vintages. If that is so, consumers will have the opportunity to acquire exceptional wines for an attractive price.” With releases due to start as early as tomorrow (with Ch. Batailley), and with the First Growths and other top châteaux promising to lead the way and set the tone, there is little time for us to unwind the many mis-informed vintage pre-conceptions. I will therefore end by saying this – as is the case with all vintages, there will be triumphs, and missed opportunity for others. Some châteaux will listen to the market and release at reasonable prices, others will allow ego to dominate their decisions and make costly mistakes. All eyes are now on Bordeaux for what is undoubtedly a pivotal en primeur campaign. Bordeaux 2023: redefining “classic”

“In more recent times The Glenturret has not been a brand name that is well known in whisky.” While few might refute this, they are not typically the first words you expect to hear from the mouth of the distillery’s Managing Director. “When the new owners took over, it was a unique opportunity to take this old, heritage brand that no one has ever heard of and reposition it without any of the baggage you normally get with repositioning older brands,” John Laurie adds. In 2019, Silvo Denz – owner of Chx Faugères in Saint-Emilion and Lafaurie-Peyraguey in Sauternes – bought a 50% stake in the Highland distillery via his Lalique Group for £15.5m. (Swiss entrepreneur Hansjörg Wyss bought the other 50% for an undisclosed sum.) This marked Denz’s first move into the whisky world and a huge moment for The Glenturret. The deal with The Edrington Group, who own The Macallan and Highland Park, included the distillery, the single malt brand and more than one million litres of maturing stock. In the intervening years, the brand once known as a component in blends and home of The Famous Grouse Experience has been on an oft-used-and-cliched “journey”. The team has grown, acquiring some big names along the way, the core range has been stripped back to basics, and all the fundamentals have been scrutinised. For the first nine months after former The Macallan Whisky Maker Bob Dalgarno joined The Glenturret, he was reportedly nowhere to be seen. After his induction, Dalgarno – chalk in hand and overalls-clad – barricaded himself in the warehouse. The industry legend spent month upon month scrawling on the casks, rolling barrels around and familiarising himself with his new pet project. For the self-professed “farm stock”, the prospect of joining a manually operated distillery after working at The Macallan for 30 years was a real thrill. Dalgarno could experiment and affect change. New contracts with local farmers to run barley trials have been set up and the cask-selection process has been extensively reviewed. He and Distillery Manager Ian Renwick are a formidable team. The duo spent months drilling into the stocks and assessing what worked well and didn’t. After this, two things were taken as read: the quality of the new-make was of utmost importance, and The Glenturret would stay a small, hand-operated distillery. “Other brands will use casks as their dominant flavour profile,” Laurie explains. “We use our new-make spirit. It’s the backbone of The Glenturret. You should be able to nose our new-make spirit and nose it at 30 years old and never lose that character.” The Glenturret new-make spirit is light and quite soft because of the long fermentation and slow distillation methods. In order to preserve this character and avoid railroading it, cask selection is key. This, according to Laurie, has been instrumental in 80% of The Glenturret’s maiden whiskies selling out in the first seven months. “We were really keen not to be the brand that just puts the same liquid in a shiny new bottle and charges a different price point for it,” the Managing Director says. That said, innovation – or, as Laurie prefers it called, experimentation – is high on the agenda at the Highland distillery. “It’s less scientific clean rooms and more overalls and a lot of incredibly long hours and hard work,” Laurie adds. Ostensibly, the culmination of the first stage of this experimentation is the 2020 series of releases, which includes the familiar TripleWood and a scattering of age statements. But look a little harder and the range is an adept exploration of refinement, questioning age, alcohol strength, refill casks and peat. The team has also not shied away from the issue of transparency – something that the whisky world has not always embraced. “We will tell people exactly what’s in our whisky; we won’t hide anything,” Laurie says. “If you want to know how old our non-age statement is then we will tell you. It’s all about the quality of the liquid for us.” In production terms, The Glenturret is considered small batch. As Brand Ambassador Jamie Morrison quaintly puts it, “At roughly 200,000 litres of alcohol per year, that’s a piece of plankton floating in the Pacific in relation to much bigger, more automated distilleries.” For Laurie, balancing genuine scarcity with a territory-by-territory approach will be instrumental to their success. “You want to explain to the consumer that when it sells out, it sells out. There is not going to be another one coming out the back of it. But also managing it to the point where it is not so hard to get that the consumer loses interest,” Laurie says. “We wanted to make sure everywhere we opened up we looked after as we grow. For The Glenturret to really work, it has to be sold in a location where somebody can take the time to tell the customer the story and understand what makes us different. I would rather they didn’t make the sale than make the wrong sale. “This distillery can’t put out any more than 500,000 litres of alcohol unless we started putting on extensions and changing the process completely,” Laurie says. “And there is absolutely no willingness from the ownership all the way down through the team here to do that. So, The Glenturret will reach that 500,000 litres of alcohol production level and stay there.” Morrison picks up the point: “Everything we do is truly small batch and that comes with its own set of challenges in terms of production, but it also makes us quite nimble which means we can afford to do small experimental runs of different barley. We can adjust fermentation times and adjust the run times of the stills quite easily. And that affords us opportunity to effectively have a play round and see what happens.” The words “small batch” and “limited” are often bandied about in the drinks world. In fact, The Glenturret is well-positioned on many fronts when it comes to buzzword bingo, but there is a sincerity in the mission here and a stellar line up of talent which will ultimately let the liquid do the talking. Inspiration often strikes at unexpected moments. For Salvino Benanti, owner of the eponymous winery, it was late at night in his office at a London investment bank, when he overheard his boss on a phone call, apologising to his wife for not being home. “I heard him say, ‘Imagine one day, if this all works out, we’ll retire and move to the Mediterranean.’” Salvino recalls this moment, which became a turning point in his life: “I suddenly thought, well I could do that tomorrow.”   Salvino’s late father was Dr Giuseppe Benanti, a former pharmaceutical company owner, who himself also once pivoted mid-career to return to his small Sicilian hometown to make wine and is today widely credited with launching a winemaking renaissance in Etna that has propelled the tiny region from relative anonymity to international recognition and acclaim.  Although wine has been produced across Sicily for centuries, the area around Mount Etna where the Benanti family is from had fallen into obscurity by the 19th century, with many poorly maintained or abandoned vineyards and virtually no commercial wine production. In the early 1980s, however, Giuseppe embarked upon a decade-long research project, where he methodically studied the soil types, local indigenous grapes and microclimates. In a very short time, he came to realise the potential of his birthplace. Giuseppe hired a local oenologist named Salvo Foti in 1988, and the two joined forces to make wine. He found in Foti an equal level of passion, drive and belief in the potential of Etna. Together they crafted the first release of Benanti wine from the Etna DOC in 1990, neither likely realising that they had sparked the resurgence of a neglected wine region.  
Shaped like a backwards crescent, the DOC of Etna is anchored of course by Mount Etna, an active stratovolcano that rises nearly 11,000 feet above sea-level. Mount Etna towers over the eastern side of Sicily, breaking the skyline in dramatic fashion and creating a wine region that is distinct not only within Sicily, but the wine world at large.  Generations of eruptions have altered the soil content, creating a patchwork of soil types around the peak. The high elevation provides respite from the hot climate of lower-lying Sicily, and the vineyards on the north side are protected from the hot Sirocco wind blowing from the south. Mount Etna remains one of the world’s most active volcanoes, with eruptions, ash clouds and lava flows nearly every year, albeit very slowly and in a predictable direction, away from villages and vineyards.   Only a few decades ago, the most well-known grape in Sicily was Nero d’Avola. Often made in an accessible, full-bodied and bold style, Nero d’Avola was easy to grow, and easy to love. Frequently blended with international varieties to add colour and weight, it quickly became an international hit. Many assume the southerly latitude relegates Sicily to only wines like Nero d’Avola – dark and dense. Mount Etna tosses this logic out the window, however.   The rocky, steep vineyards of Etna have always been planted mainly to three indigenous varieties: the red grapes Nerello Mascalese and Nerello Cappuccio, and the white grape Carricante. Nerello Mascalese produces wines that are light in colour, with elevated tannins providing ample structure. The wines can be ethereal, and much like Nebbiolo and Pinot Noir, have a remarkable transparency that allows the specific location to imbue itself into the wine, with even neighbouring plots expressing themselves quite differently. With sour cherry and wild red plum notes, as well as faint tobacco, someone tasting Nerello Mascalese blind for the first time might be excused for thinking the wine was perhaps a gentler style of Nebbiolo, or alternatively a more grippy, savoury style of Pinot Noir. In many ways the variety captures the best of both. Yet, until recently, Nerello Mascalese was obscure. “It was considered to be a bulk wine. People didn’t know it that well, so we weren’t noticed at first,” Salvino explains.   Nerello Cappuccio, with its darker colour and softer tannins, has often been used as a blending partner for Nerello Mascalese, making it more approachable, though for many producers, it has fallen out of fashion as Nerello Mascalese ascends the ladder of critical opinion. Carricante, on the other hand, is a high-acid grape, with intense minerality and a slightly saline character. Described by Ian d’Agata as “potentially one of Italy’s greatest cultivars, white or red”, Carricante can thrive at high elevations and develops fascinating, almost Riesling-like petrol aromas with age.  While some viticultural generalities are true across the region – trace elements such as iron and phosphorous are uniformly high across the DOC, for example – the soils are surprisingly varied between contradas (a delineated local municipality of sorts, often borrowed by winemakers in Etna to signify which part of the DOC their wine hails from), of which there are 142. Even a change of a few hundred feet in elevation can mean a difference in depth of soil as well as soil structure.  Although to outsiders, living next door to an active volcano might seem to be a risky proposition, Salvino, like most Sicilians, doesn’t seem to be overly concerned.  The ash that often floats down from the volcano is not necessarily a bad thing, he explains, unlike the ash from wildfires. While ash from burnt wood and vegetation is highly acrid and easily taints wine with a bitter aftertaste, volcanic ash, on the other hand, is odourless and tasteless. When it falls in Etna, it hardens into flakes of pumice, Salvino explains, which crunch underfoot like breakfast cereal, but soon break down into a much finer, sandy texture, as it becomes part of the soil and terroir.  After 25 years at the helm of his winery, Giuseppe passed the torch to Salvino and his twin brother Antonio in 2012, giving them full ownership. The brothers, in many ways, led parallel lives. Born in Sicily, the two were educated abroad, and both worked as bankers in London. And, most fortunately, both were of a similar mindset when it came to the family winery. Having felt they had achieved enough in their careers, Salvino and Antonio came to a mutual decision to move back to Sicily – the lightbulb moment Salvino experienced in his office was a sentiment shared by his brother.   By the time they took over, Etna was fully on the radar of wine enthusiasts around the world, who were intrigued by the prospect of mineral-driven wines made on the side of an active volcano. The beginning was not easy, however, Salvino says, as their father was forced to step back and let his sons build their own path together. “We had a lot of confrontation and debate. My father was stubborn, and wouldn’t listen to anyone, but we had the final word. He became a loud advisor with no power,” Salvino laughingly remembers. They made tough decisions, including selling off a few vineyards and reducing the number of wines produced. “We were a bit ruthless,” he admits.  Today, the brothers act as co-general managers, overseeing the production of 250,000 bottles of wine per year, all made from the three indigenous varieties, coming from five distinct contradas in the DOC. Their white wines are made from 100% Carricante, vinified in stainless steel and never aged in oak, while the red wines are either mono-varietal, or comprised of Nerello Mascalese blended with a small amount of Nerello Cappuccio. They avoid new oak in the winery, choosing instead to age in neutral vessels where “the elegance expresses itself quite freely”, Salvino explains.  When people think of Sicily, they think of opulence, richness and power. “This is not correct,” Salvino emphasises. Though only 5% of Sicily’s wine production comes from Etna, the wines could not be more different than the rest of the island – and southern Italy for that matter. “We are about elegance, leanness, and cellar-worthiness,” he explains.  Salvino elaborates on the distinct shift in style since he and his brother assumed control. He explains that in the early days of the winery, more oak was employed and the wines were more forward. “In the 1980s, no one knew or cared about Etna, so I think my father was trying to capture the world’s attention, maybe trying to connect with Nero d’Avola drinkers.” When Salvino and Antonio took over, however, they were open-minded and “free from prejudice”: “We didn’t have a pre-formed view of anything,” he says. This allowed them to examine the wines with fresh eyes, and rather than try to emulate another region or variety’s style, they made the decision to allow the grapes and soil of Etna to speak for themselves. “We realised that what the world wanted from Etna was more pureness.” And this is something they continue to strive for. “We would like more purity, more elegance, more finesse, always,” Salvino emphasises.    In less than 40 years, the spark that Giueseppe Benanti provided ignited a revolution, one that his sons – along with a host of other winegrowers and winemakers on the island – carry on today.  Salvino feels that there is now a clear Etna identity, supported by many up-and-coming younger producers. From only a few decades ago, when his father was introducing the wines of Etna to the world, there are now over 440 producers within the Etna DOC. The appellation, however, remains a niche even within Italy, producing only 5.8 million bottles per year, making it smaller than Barolo.   And this next generation of winemakers continues to push forward. The producers in Etna recently voted unanimously to apply for DOCG status, a process which can take up to 24 months to get approval, though it seems inevitable given their region’s sharp upward trajectory. Some rules will become more stringent, such as lower mandated yields and longer ageing requirements – as Salvino puts it, “We will be forced to go down a more difficult route” – but ultimately this will only help to continue to uplift the quality of the wines and their reputation.

“Turbot,” Hugh Johnson says, the sense of satisfaction-to-come oozing down the phoneline. It’s a Friday morning and like any dedicated oenophile he’s already planned dinner, and – most importantly – what he’ll be drinking. I expected white Burgundy, something majestic drawn from a cavernous cellar, but Johnson – arguably the world’s most famous wine writer – is not nearly that traditional, or predictable. A Cambridge degree, a flawless RP accent, an air of good tailoring and tweed, and 60 years in the wine trade might lead you to think otherwise. But, throughout our conversation – even with a Covid-safe telephone call in lieu of a face-to-face – there’s an undeniable sense that there is forever a twinkle of mischief in his eye, and that Johnson is a man who enjoys being ever so slightly provocative. On the aforementioned Friday night, he was planning to uncork a bottle of Kit’s Coty Bacchus – “Giving it a good chance to show,” he says. Chapel Down’s single-vineyard bottling of England’s trademark grape comes from a chalky site on the North Downs, a spot that Hugh thinks is “a Grand Cru of the future”. He’s currently particularly excited about the prospects for England’s wine production – “Not just because I’m a patriotic citizen,” he reassures me.  “I’m passionate about the new school of English winemaking… wonderful characters and flavours are emerging from the south of England.” Gusbourne’s 2018 Pinot Noir “blew [his] socks off” and he’s keenly following low-dosage experiments such as Dermot Sugrue’s #ZODO. He wonders if perhaps the line of chalk between the North and South Downs could in fact be the Côte d’Or or Champagne of the future. It was an oft-quoted encounter with two Burgundies at university that set a young Johnson on the path to wine writing. I love the image of his university room-mate stumbling in a little too merrily, sloshing fine wine over the floor and Hugh’s undoubtedly immaculate notes, insisting that the serious and studious character sampled the two glasses in his unsteady hands. “One was magic and one was ordinary,” Hugh has said of the incident: he was instantly hooked. Cambridge’s Wine and Food Society laid the groundwork for his education, and he penned his first wine column for Vogue in 1960 – recommending a rather ambitious line-up that included 1955 Cheval Blanc and 1960 Ch. Margaux. There was a stint at House & Garden, then he took over from André Simon as editor of Wine & Food, joined The Sunday Times and started turning out a series of smash-hit books, starting with The World Atlas of Wine in 1971. His annual Pocket Wine Book – the world’s best-selling wine guide – has been solid stocking fodder for 44 years. The Story of Wine – first published in 1989, and a reprint of which is the cause for our conversation – is my personal favourite. It’s a book that captures exactly why I love wine: it literally seeps through our history, a liquid that links nations, cultures and generations. And Johnson’s passion for the topic drips off the page; writing that’s as intoxicating as the substance it describes. The oeuvre feels like it hasn’t aged a day since its initial publication, expertly tracing our ties to the vine and its fruit “from Noah to now”.   The copy I was gifted aged 21 is a hefty thing – an impractical hardback of coffee-table only proportions that precludes it being devoured the way it should be. I was delighted, therefore, to discover the latest edition is much more comfortably lap-sized – as Hugh describes it, “friendlier”. It’s a book that begs for an afternoon in the armchair. But it’s a book he never set out to write, and one that fell out of a foray onto the small screen. Much of the research was undertaken by a young history graduate Helen Bettinson, for a series aired the same year on Channel 4. “I learnt so much about history generally, never mind the wine part,” Hugh says. And that’s part of the joy of The Story of Wine – it’s not really a wine book; it’s just a great book, that happens to be about wine.  “When I started, there was very little knowledge around,” Hugh explains. “I saw my job as stirring up interest, encouraging people to enjoy wine in a very general kind of way.” The tricky thing, over the years, he says – has been avoiding the tendency to get closer to the subject, to focus on ever more detail – “sometimes a really boring amount of detail,” he chuckles. His heart sinks, he tells me, when someone asks him what the percentage of X grape is in a wine – “I’m not interested in percentages, yet the world is,” he laments. “To be frank, I sometimes think that journalists get into the nitty gritty because they have nothing better to say.” He’s a man tired of the state of wine writing (“glossy magazines full of incredibly boring photographs of vineyards”), and especially with winemaker profiles (“It’s pretty hard to engage the average consumer in the story of an Italian farmer: there are millions of them”). We should be, he feels, “getting the point of a wine” – but, most importantly, not the points. Johnson has long riled against scores. “My real beef against it is that it gives the impression that there’s something absolute going on,” Johnson says. He understands that for consumers it’s a short-cut (“you don’t have to read all the blurb”), but he’s fought long and hard to try and wean them off their numbers dependency. How something as varied and glorious as wine, something so dependent on “mood and moment” could be captured by mathematics – for Johnson – beggars belief. “The whole notion of a 100-point wine is unimaginable to me – how could it not be better?” For Johnson, a fine wine is a wine worth talking about – and that sums up rather neatly why scores are, for him, so offensive. As he says in the preface to the new edition of The Story of Wine, “If [wines] lack the power of speech they can still tell stories.” He’s sold 20 million books (and counting) filled with their stories, and his. But what’s next for the veteran wine writer? Well, proofs for his next gardening tome – the latest anthology of Trad’s Diary – are sitting on his desk awaiting attention. It is hard to imagine The Balvenie without David Stewart MBE and vice versa. The story of each one is so entwined with the other that it’s nigh on impossible to unpick where one starts and the other ends. Since joining William Grant & Sons in 1962 as a whisky stocks clerk, Stewart has gone on to become of the most well-known and respected names in the Scotch whisky industry. He is, for many, the pioneer of cask finishing, and his achievements are far too numerous to list. When the incredibly humble man “hangs up his boots” after a 57-year-plus career, Kelsey McKechnie will become the youngest-ever female Malt Master. “Everyone always jokes and says do I feel the pressure and what does it feel like getting into a role like this. There definitely is an element of pressure around it but it’s funny, you really don’t feel it. I enjoy this role and I love being here. I’ve been very lucky, so I’m saying ‘let’s ride it out for as long as we can’,” the 29-year-old says with unfettered excitement. The Malt Master role is a very different one today than it was in the 1960s, something McKechnie and William Grant & Sons Master Blender Brian Kinsman continually rib Stewart about. “Obviously, way back in the ’60s we had very little to nose,” Stewart says in a flash. When he joined the family-owned business under Master Blender and Balvenie Malt Master Hamish Robertson, Glenfiddich and The Balvenie weren’t being bottled as single malts and Grant’s Standfast blend was the company’s bread and butter. Today, the triumvirate nose samples from Ailsa Bay, Girvan Distillery, Kininvie, Glenfiddich and The Balvenie. From the new-make spirit to mature samples, bottling runs to all the vat samples, everything produced at the William Grant distilleries in Scotland and Ireland passes under the noses of Kinsman, McKechnie and Stewart. This equates to approximately 40-50 Scotch, Irish whiskey, Bourbon and rum samples per day. There are a number of parallels in Stewart and McKechnie’s stories, which they don’t even seem to realise. Both started in very different roles and eyed an interesting opportunity to nose spirits. Through serendipity and, one suspects, a tremendous amount of inherent skill and hard graft, the two found their way into the nosing lab. And once faced with row upon row of whisky samples, the pair knew in an instant that they found their calling. “I always say I have been very lucky,” McKechnie says. “I’m such a firm believer in timing. I came into the team at a time when I had built up enough technical process skills to understand how whisky is produced and carry out analysis, and do all these different things and apply it to blending.” In 2018, Kinsman and Stewart approached 26-year-old McKechnie to ask if she would be interested in learning all things regarding Balvenie and eventually moving into the Malt Master role. She’d been with the company for almost four years at this time, working her way from the lab to the whisky stocks team, from the Lowlands to the beating heart of the business in Speyside. So, what does it take to become a Malt Master and what did the two whisky patriarchs see in the young female scientist at the infancy of her whisky career? According to Stewart, one of the biggest things is the nosing aspect. “We can identify what’s right and what’s not, just by nosing the whisky,” he says. “And that’s what takes the time to learn.” Stewart had already been through the process of training a successor with Brian Kinsman from 2001 to 2010. It might be hard for some to fathom why this apprenticeship takes the best part of a decade, but so much of the role is about instinct and the finest of margins. In the same way Robertson brought in samples for Stewart – albeit not quite as many – all those years before, Stewart to this day brings in spirit samples for Kinsman and McKechnie. “Really, it’s nosing together; pointing out things,” Stewart adds. “I bring in samples from different cask types and different ages. Brian just worked with me and gradually he took over and I was doing less and less.” When asked if she thinks she has a natural gift, McKechnie says it’s curiosity above anything else that’s required to be a good noser. “I think everybody just needs to be curious enough to want to nose. Most often – apart from a few people where it is genetic and there’s one reason or another that they don’t have a sense of smell – I actually think so many people will be fantastic nosers.” And the difference between Joe Bloggs and the youngest-ever female Malt Master? The word association piece, according to McKechnie. “So often we’ll see when people are starting up that they can nose something and they can say ‘this is different’. So we do difference nosing. We have one glass and we’re just nosing it against another and saying ‘pick up the difference or not’ – it’s often easy for people but they can’t put into play what they can pick up.” Like any other skill, McKechnie says it takes years of practice and fine tuning. “It’s like using a different language,” she says. “To remain fluent, you need to continually keep nosing and to be able to relate those words to what you’re picking up in nose and taste. I actually think everyone has a gift, if that’s what you want to call it, or the ability to do it. It’s just about really working out what flavour this is and what do we call it.” Sometimes tasting notes for spirits and wines can be a little, shall we say, creative. For this reason, at William Grant & Sons, free words are banned. “We’re really strict about what people can call the different spirits,” McKechnie explains. “It could be too easy for somebody to say ‘this smells like a walk in the park’ and we can find ourselves in a bit of a pickle.” When starting out, as a professional or merely an appreciator of spirits, this word association piece can be a barrier, according to McKechnie, but it shouldn’t be. “There is no need for whisky to be intimidating at all,” she says. “For me, I think it’s because people are so passionate about it. It gets everyone a little bit puffed up – I’m guilty of it as well. But there really is no need for it at all because it really is such an open area that there isn’t one strict answer so I’ll always say that to people – if you are new to it, make sure you get lots of water in there because whisky is just such a flavour bomb. I think people don’t really know what they’re nosing because there are 50-100 different flavours coming at you at once.” So, do the three professional nosers ever disagree? “Because I’ve only ever learned to nose and blend from David who has learned from Brian and vice versa, we don’t often butt heads or have a difference of opinion –  but it does happen,” McKechnie says with a coy smile. Rather than being daunted by the spectre of the longest-serving Malt Master and Kinsman – who has racked up a fairly daunting 24 years in role – McKechnie seems energised by the legacy and is visibly thrilled at the prospect of one day imparting this knowledge to her own apprentice. “I think it would be a massive compliment to be able to give someone the knowledge you have gained,” she says. “I really like the thought of actually one day being able to train someone.” When it comes to the future at The Balvenie, McKechnie says they have “many things bubbling away in the warehouses” and they have “a few more Balvenies tucked up our sleeves”. But, on a personal note, “it’s working with Brian and David day-in-day-out and gaining more of the understanding about what makes Balvenie so unique. Understanding more around the stock model and that 50-year horizon and ensuring that I’ve got the skills to make sure the next 50 years is looking good and that we’re not laying down all the wrong things.” The Balvenie maintains a lot of the traditional whisky-making traditions. It is the only Scotch whisky distillery to grow its own barley, use traditional floor maltings and keep coppersmiths and coopers on site. Rather than being gilded handcuffs, these ties to traditions allow the team to experiment at the point of distillation and Stewart has spearheaded a number of trials that have come from the maltings throughout his career. “I think if there is one thing that David has ever taught me, it’s about how important innovation is,” McKechnie says. “We always talk about the fact we’re the home of cask finishing. It was something that was second nature in David’s role until people started calling it innovation. “And it’s something that we always want to pass on. We’re constantly thinking about what’s next and how can we do something unique and what exciting things we have in the distillery that we could release and bring to everyone. “Obviously the Scotch Whisky Association is pretty strict, in a good way, so that no-one is going to mimic us, but we also like to push the boundaries a little bit and say, what can we really get away with here?” With a glint in her eye and an unmistakable enthusiasm in her voice, you can’t help but feel The Balvenie, when it comes to honouring tradition and driving innovation, is in very safe hands for the next 50 years and beyond. Percarlo and La Ricolma are two of Italy’s finest wines – both crafted by Luca Martini di Cigala at San Giusto a Rentennano. Percarlo is the Tuscan estate’s top Sangiovese bottling, made with the most concentrated and best fruit, picked in a third and final pass through their vines (with the previous passes used for the estate’s Chianti Classico and Chianti Classico Riserva). When Martini di Cigala first made the wine in 1983, however, it was illegal for Chianti Classico to be 100% Sangiovese, so he had no choice but to declassify the wine to an IGT. Although the rules have since changed, Percarlo’s reputation precedes that of the Chianti Classico denomination and remains an IGT.  La Ricolma is 100% Merlot – a variety with a very different temperament to Sangiovese. The fruit for this wine is picked all in one go; the secret to finding balance in Merlot, the Martini di Cigala says, is to slow its ripening – a challenge that must be tackled throughout the season.   The result is two completely different wines from two different varieties grown on the same estate in Gaiole – Chianti Classico’s southernmost district.  Last Thursday, we hosted a special dinner pitting these two legendary wines against each other. Luca Martini di Cigala returned to London for the first time in over 30 years, with his wife Bettina, to present some of the estate’s finest bottlings, with vintages back to 1998. Tasting these wines at full maturity was a privilege, made all the more special by the fact they were all served from magnum – and came from Martini di Cigala’s personal cellar. With so few magnums produced, many of the wines on show had never been commercially available – the large formats reserved for the family’s private consumption.   Martini di Cigala selected a range of vintages that he felt were in their sweet-spot and included the 2007, 2006, 2005 and 2004 of both Percarlo and La Ricolma – followed by a rare 1998 Percarlo. The wines were extraordinary.   Having been fortunate enough to have tasted the 2018 La Ricoma and Percarlo earlier in the day – which were stunning in their youth – it is mind-blowing to see how these wines develop with 15 years or more in bottle. With age, the purity of fruit found in the younger vintages takes on hedonistic, richer aromas that set the drinker’s pulse racing.   The aromatic appeal of La Ricolma is about as beguiling as wine gets and the 2007 (in what Cigala describes as a hot vintage) was arguably the wine of the night. It just shows how resilient Merlot is in San Giusto’s vineyards. A grape often seen as too alcoholic and overpowering in hot vintages, in the right place it produces a wine of outstanding purity. While having all the opulence the finest Merlots can muster (which is not dissimilar to Pétrus), the balance is impeccable. Tasting 2007 Percarlo alongside 2007 La Ricolma was a fascinating comparison – something that rang true throughout the vertical we tasted. Where the Ricolma was more exuberant, Percarlo was more austere, although this seems too stern a word, such is the wine’s finesse. The Percarlo certainly seems more vertical – yet it is one of the smoothest and most rounded Sangioveses you are ever likely to taste.   Martini di Cigala notes that the San Giusto vineyards are not that high in altitude compared to his neighbours at Castello di Ama. This means that during the day his vineyards are as hot as those in the more southerly, warmer Montalcino; the difference is that San Giusto has much cooler temperatures at night, allowing the fruit to retain vibrancy and cooler fruit tones – something that shone through in all the wines tasted.  Martini di Cigala is one of the most modest winemakers I have ever met. Asked what his secret is, he says he has none. But, as he talks about his wines, the terroir – and his amazing memory of weather episodes decades ago –  he clearly has an exhaustive understanding of his craft. It was a delight therefore to see him become so animated when the 2006 Percarlo was poured. Tasting the wine, he professed to the guests, with a big smile on his face, that this was one of the finest Percarlos he has ever made – this was the wine he always wanted to make. He recalls the harvest and said, “These were the best grapes I had seen in my life.” It was a joy to taste this wine 16 years on with its deservedly proud maker.  The 2005 vintage, noted Martini di Cigala, was a vintage full of expectation. Vignerons were very excited about the wines’ prospects, but then the vineyards were hit by wet weather during harvest. Despite this, the 2005 Percarlo and La Ricoma are magical. While they don’t have the concentration of the 2007 and 2006, they still capture the San Giusto magic. In my 2005 La Ricolma tasting note, it says “otherworldly” – so it must have been pretty special.  The 2004 La Ricolma is particularly elegant. The nose is again extraordinary – the palate texturally sublime and the wine has impeccable balance. The 2004 Percarlo is, as Martini di Cigala noted, “a particularly elegant vintage for Sangiovese”.  The wine has fantastic clarity to the fruit, mouthwateringly juicy but with amazing structure too. The tannins are just so fine – it is incredible. Just 18 magnums of the 2005 and 2004 La Ricolma were ever made – so it was a real privilege to have them at the tasting and for them to be showing so well.  After comparing the four vintages Martini di Cigala felt the 2005 and 2004 have reached optimum maturity, having fully opened and reached their peak. The 2006 and 2007 on the other hand, “still have a certain amount of coiled spring energy to the wine – they still have more to give”.  We begged Martini di Cigala to bring a very rare 1998 Percarlo from his cellar – providing a particularly grand finale. At nearly 25 years of age, the wine was magnificent. It captures all the character that runs through the previous vintages of Percarlo – with incredibly refined tannins, vibrant acidity and classic Sangiovese structure, while also being so smooth and rounded. Even with age, the structure was solid and had matured beautifully.  Looking back at the wines, it is the Tuscan terroir that clearly defines these two wines. La Ricolma has the opulence and complexity of Pomerol but with that austere edge, that vibrancy and verticality that you only get from Tuscan soils. In comparison, the Percarlo has the vibrancy and Tuscan verticality, but there is no astringent edge – such is the finesse of the tannins. Some preferred Percarlo’s more classic Italian acerbity, while others loved the uniqueness and profundity of La Ricolma. Tasting them side by side was such a joy, the wines offering two very different varietal expressions while also sharing a similarity of place. These wines – even the Merlot – just couldn’t be from anywhere but Tuscany.  It's fitting that Alessandro Masnaghetti – the man who created the groundbreaking viticultural maps of Barolo and Barbaresco – has just published his new book, mapping the terroirs of Chianti Classico. It’s a book Luca Martini di Cigala is immensely proud of, having championed the differences in sub-zones for decades; now he has the proof – and he brought a copy for both us and the River Café’s Ruth Rogers. Her late business partner and co-founder of the London institution, Rose Gray visited San Giusto many years ago – it was fitting for Martini di Cigala to be able to repay the favour for this special evening.  While the tasting might have been billed as Percarlo versus La Ricolma, it was a friendly battle. It was great to see them both showing so well and how complementary they were tasted side by side. One of the most notable takeaways from the evening was the outstanding consistency. Every wine on the table sang. Every wine was impeccably balanced. Every wine was full of character and complexity. It was a special, rare opportunity that will live long in the memory.
