Saint-Emilion has been hitting the headlines. And not in the way it would like to. In July, just after the region’s châteaux submitted applications for the 2022 classification, two of the region’s four Premier Cru Classé A estates – Chx Cheval Blanc and Ausone – announced that they would be withdrawing from the classification system. This week sees a dispute over the 2012 classification enter the courts – with accusations that the results were fixed. The Médoc’s leading names were ranked in 1855 – with but one change (Ch. Mouton Rothschild's promotion) in 1973. The classification was uncomplicated, with no fussing over terroir, tastings or winemaking talent; it was based purely on price. It’s hard to believe that it remains relevant today – but, while of course there are properties that stand out, it’s more or less accepted, and reflective. Across the river in Saint-Emilion, they wanted something different. Something fairer. A system that flexed with an estate’s waxing and waning. The ambition was – and is – laudable. The reality, well… The classification is overseen by the Institut National des Appellations d’Origine (INAO) – the body responsible for France’s appellation system. The concept was mooted in the 1950s, with the first list published in 1955. The idea was that it would be re-drawn every 10 years – both to be more democratic and provide an incentive for long-term quality. Unlike the Left Bank’s system, it would assess terroir and include a tasting of the wines. The aim was, and is – as a spokesperson for the INAO told me, to help consumers distinguish between the region’s many properties and help “maintain a level of excellence”. The classification is based on a scoring system out of 20, with the breakdown of scores different to qualify for Grand Cru Classé (requiring a minimum 14 points) versus Premier Grand Cru Classé (requiring a minimum 16). In 2012, the possible points for Premier Grand Cru Classé were broken down thus: 30% based on the quality of the wine – with a tasting of 15 vintages; 30% on the estate’s terroir; 35% on the property’s renown (both national and international), promotion and distribution; and the remaining 5% on viticulture, vinification and traceability. Even the first, 1955 list was disputed, changed just three years later, then again two months later, before settling on 63 Grands Crus Classés and 12 of the elite Premiers Grands Crus Classés. The very best of this latter group were named “Premier Grand Cru Classé A” (the rest Premier Grand Cru Classé B) – with just two making the cut, Chx Ausone and Cheval Blanc. Since 1958 the region’s wines have been re-classified regularly – if not quite on the 10-year cycle forecast, in 1969, 1986, 1996, 2006 and then 2012. But there has always been an undercurrent of discontent. In 2006, five properties filed lawsuits and the ruling was declared invalid, with the 1996 classification reinstated. For the 2012 classification, the INAO seemed determined to clean things up. The tastings and site inspections were, for the first time, outsourced by the INAO, with wine professionals from other regions (Burgundy, the Rhône, Champagne, the Loire and Provence) roped in – including Marcel Guigal and Robert Drouhin. A company called Qualisud was to handle the tastings, while Bureau Veritas would take on visiting the estates. These independent authorities would, they thought, make it indisputable. The result was two new Premiers Grands Crus Classés A estates – with Chx Angélus and Pavie; while Larcis Ducasse, La Mondotte, Pavie Macquin, Troplong Mondot and Valandraud all promoted to Premier Grand Cru Classé B, and significant changes to the Grands Crus Classés (with a new total of 64 estates). But of course that wasn’t the end of it. Enter Chx Corbin-Michotte, Croque-Michotte and La Tour du Pin Figeac. The latter two had applied for and hoped to be promoted to Grand Cru Classé, while Corbin-Michotte was demoted in the 2012 rankings. They argue that the decision against them was “incomprehensible”, challenging the criteria for classification and insisting that two individuals – Hubert de Boüard (of Ch. Angélus) and Philippe Castéja (of Ch. TrotteVieille) – had “undue influence” with their roles within the INAO. It’s alleged that de Boüard was “present at all stages of the process elaborating the 2012 classification” (with it implied he influenced the ranking not only of Angélus but seven properties for which he consulted), while Castéja “pulled strings” to guarantee TrotteVieille’s Premier Grand Cru Classé status. The case went to administrative court, however the plaintiffs lost in 2015. They appealed, but lost again in 2019. And now they’re taking it to the criminal courts, with jail time and a fine of up to €500,000 on the cards for the accused. When I asked Frédéric Castéja – Philippe’s son and General Director of Borie Manoux – about the accusations, he told me: “I can only tell you that the Attorney General has dropped all accusations against [my father] and stated that he was not concerned at all with this so-called ‘influence’.” “When it comes to a public ranking, the level of controversy is as high as the stakes,” the INAO told me. It’s unsurprising, perhaps, given the impact the classification can have on an estate’s bottom line. After their promotion in 2012, Chx Pavie and Angélus saw instant price hikes: 2012 Angélus was released at 30% more than the 2011 en primeur, while Pavie went up 58%. That’s big bucks. And beyond the actual wine, it’s the land prices that really rocket. It wasn’t just these three (relatively minor) properties that seemed dissatisfied. Rumour has it that each year, the Médoc’s First Growths, Cheval Blanc, Ausone and Pétrus (“the group of nine”) all meet to taste the latest vintage. After Pavie and Angélus became newly minted First Growths, the group reportedly preferred to restrict the group to the original set. And in 2012 Ch. Ausone quietly removed the classification from its labels – a hint at what was to come. Eric Morain – one of the lawyers representing the three disgruntled estates – has commented that the classification has become “a system that sells the brand and no longer the grape”. La Revue du Vin de France’s 2021 Man of the Year, the attorney is a specialist in the world of wine and has earned a reputation for standing up for the little guys. He was instrumental in establishing the Syndicat de Défense des Vins Naturels (which introduced the Vin Méthode Nature trademark last year – a formal definition for natural wine in France), and has defended several wronged natural wine producers, such as Olivier Cousin and Alexandre Bain. Morain’s latest crusade, however, is against two goliaths – with connections and deep pockets. “The classification was thought out and developed and judged by people who had a direct interest. The rules were not the same for everyone,” Morain said on email to me. De Boüard and Castéja should have recused themselves, he argues. For Chx Corbin-Michotte, Croque-Michotte and La Tour du Pin Figeac (“They aren’t notable, just winegrowers who do their job well,” Morain says), this isn’t about money. They just want someone to admit they were wronged, unfairly excluded from the ranking. “Will they be convicted?” Bordeaux expert Jane Anson pondered, “I would imagine not, but I guess we will all have to wait and see...” For her, the drama is an unnecessary distraction “from the excellence of the wines and the entire classification”. In the meantime, the process for the 2022 classification has been rumbling on, with applications submitted this summer. Some changes have been made, again trying to make the classification – once and for all – watertight. Independent third party Bureau Veritas is now in charge of both tastings and site inspections, and the weighting of the tasting element has been increased for the Premiers Grands Crus Classés (bringing it in line with the weighting for the Grands Crus Classés) – worth 50% of the score (previously 30%) – while the portion for a property’s terroir has been reduced to just 10% (previously 30%). The puzzle is why the criteria remain different for a Premier Grand Cru Classé versus a Grand Cru Classé – something for which I haven’t been able to find an answer. Given estates need to score 17 for the heralded Premier Grand Cru Classé A, 16 for Premier Grand Cru Classé B and 14 for Grand Cru Classé, why make things even more complicated and declare that, for example in 2022, the quality of terroir has more significance for a Grand Cru Classé than a Premier Grand Cru Classé estate (20% versus 10% for the latter)? To make it into the upper echelons of the Premiers Grands Crus Classés, reputation is considered key – and this is a sticking point for many. While reputation, promotion and distribution represents 20% for the Grands Crus Classés, it stands for 35% of a property’s score for Premier Grand Cru Classé status. Including elements such as wine tourism, social media, PR and the accessibility of an estate, it has prompted remarks that the size of a winery’s car park has more relevance than the quality of its soils. The INAO emphasises that the criteria are very similar to those of the original classification in the 1950s. Reputation has always been included, they argue – they are simply adapting this to the modern day. Either way, it’s a minor element, they assure me – with, for example, social media representing just 0.3 points, or 1.5% of the final score, while wine tourism makes up a mere 1%. This hasn’t soothed the worries of the region’s two original Premiers Grands Crus Classés A properties, Ausone and Cheval Blanc. News broke soon after applications for the classification closed on June 30th that the prestigious estates had not submitted anything. When I spoke to both estates ahead of en primeur (April this year), the responses were interesting. Pierre-Olivier Clouet, Technical Director at Ch. Cheval Blanc, noted it was “a touchy question” before he continued. “We believe it’s quite difficult in 2021 to classify the wine like in 1855. This is not the same period this is not the same price per hectare, it is not the same price per bottle… Producing an outstanding wine is difficult on paper,” he said. “We don’t produce wine for the critics, for the classification – we make wine for the wine lover. Premier Grand Cru Classé A, Premier Grand Cru Classé B, Grand Cru Classé… we are Cheval Blanc, that’s it.” When I enquired whether he felt a wine’s distribution should have as much weighting as its terroir, he shrugged and smiled: “The answer is in the question.” Pauline Vauthier of Ch. Ausone was less willing to broach the topic, not wanting to be embroiled in the debate. “What counts is the quality of the product,” she said – making very clear that that is where the estate’s focus lies. “There are many classifications and they’re difficult for the public to understand. Ausone prefers to communicate about the quality of its wine.” She added: “[The 2012 classification] created much controversy, and that will certainly be the case with 2022.” When the news broke in July that both estates were withdrawing (along with sibling estates, La Clotte and Quinault l’Enclos), Pierre Lurton (Director of Ch. Cheval Blanc) and Clouet told Terre de Vins that there wasn’t enough emphasis on “the terroir, the wine, the history”. Edouard Vauthier (Ch. Ausone) explained, “Since 2012, some criteria added are not linked into the wine itself anymore. Some people apply for the classification for economic reasons more than quality and the respect of the terroir.” He highlighted that many of their customers hadn’t even noticed that “Premier Grand Cru Classé A” was no longer on the label. Indeed, why would they? Interestingly, these estates agree with Eric Morain on this. For Morain, the tasting component should represent much more – and as long as it counts for so little, “the classification will mean nothing”. The two behemoths are their own brands – brands that are much stronger than that of Saint-Emilion Premier Grand Cru Classé A. The loser, sadly, is set to be the classification itself, and its top-tier properties – which will no longer benefit from Cheval Blanc and Ausone’s halo effect. Of course, the INAO was keen to emphasise that – whether classified or not – the two estates would always be closely associated with the region, and that there were plenty of other estates that eagerly submitted applications. “Ausone and Cheval Blanc have always been driving forces behind the appellation and I hope will remain so,” Frédéric Castéja told me. “The risk is that at the next occasion other top estates (meaning other First Growths) do the same, then if too many leading estates leave, the classification is meaningless.” Morain – unsurprisingly given his campaign against the classification – is damning about its fate. Ausone and Cheval Blanc’s departure is, for him, “a symptom of a system on its last legs”. So is the 2022 ranking set to be the Saint-Emilion classification’s swansong? Perhaps – the more important question is maybe if it matters. “Saint-Emilion has so many châteaux (by far the most of any of the prestigious appellations) that there is a definite benefit to have some way of distinguishing the best wines,” Jane Anson said. “I fully agree with the principles, in fact think the idea of a renewable classification is very much consumer-driven and provides an incentive to estates to keep investing etc, but I think it has become unworkable.” And that is the problem – the theory is excellent, but how can it be put into practice? While the classification sounds helpful in principle, for most people, I suspect it isn’t. There’s too much confusion with Grand Cru, Grand Cru Classé and Premier Grand Cru Classé A or B. Unlike the Médoc’s straightforward numbering of First to Fifth Growth, it is not – to the uninitiated – immediately clear which is meant to be better than the other. Price and branding of an individual estate will be the more important differentiator. Talking to other producers in the region, few have answers – and few wish to champion the system’s survival. I asked Noëmie Durantou Reilhac – of Denis Durantou estates – whether she’d ever wish to see something similar in Pomerol. The answer was a firm no (“definitely”). “What really saddens me is seeing some plots in Saint-Emilion Grand Cru that are truly devastated,” she tells me. When I ask Nicolas Glumineau at Pichon Comtesse in Pauillac – a producer with a little distance – about his thoughts on it, he’s quick to quip: “That’s why we have an 1855 [classification] that we never move.” More seriously, he thinks the decade cycle is problematic. “I have this feeling that one classification every 10 years is probably too fast, too frequent. Probably 25 years – one generation could be enough.” Of course applying for the classification is voluntary – and not everyone does. Ch. Tertre Rôteboeuf, notably, has never played the game – despite the high quality of its wines. (The property is also renowned for handling its own distribution, outside the négociant system.) Ch. Haut-Brion owner Prince Robert of Luxembourg recently highlighted a benefit to being outside the classification – announcing his plans to expand Quintus with vineyards from the recently bought Ch. Grand Pontet. And this really gets to the point of what could make the Saint-Emilion classification work. As Anson said to me, “Saint-Emilion is the only classification in Bordeaux that includes the notion of terroir (and in fact taste) and that is also linked to a specific piece of land.” A classified property can’t automatically include new vineyards – unlike estates on the Left Bank. The classification is admirable in many ways – but how can you really quantify excellence? Is it ever really possible to pin down the true quality of a wine, or estate, with such exactitude? Is the picture not more nebulous than points can ever paint? “All classifications are correct as long as all players clearly know the rules,” Frédéric Castéja noted. “One must remember that classifications are always the picture of the past, but of course confirm the potential of the estate.” For Saint-Emilion, even the past feels in flux – discussed and debated. What the future holds is hard to say – but, for now, we’ll wait to see what’s in store for the class of 2022. He was fined €40,000 and has not appealed the charge. Two properties, Ch. Croix de Labrie and Ch. Tour Saint-Christophe, are taking the INAO to court over their applications for the 2022 classification. In January 2022, Ch. Angélus announced it too was leaving the Saint-Emilion classification, stating the system had become a "vecteur d'antagonisme et d'instabilité". This leaves Ch. The Gin Renaissance, which kickstarted in 1999, showed the world that gin could be more than something that’s mixed with an insipid tonic and served at room temperature with a slice of lemon that has seen better days. For the next decade, the juniper-dominant spirit was unstoppable. At its peak in 2018, new gins were launching faster than you can say botanical and there was seemingly room for all. Until, like most trends, there wasn’t. Rather than the spectacular bubble burst many predicted, there has been a slowing down. There is still a thirst for gin – a whopping 83 million bottles were purchased in the UK alone in 2019 and the category is still in growth (24%), valued at £2.6 billion. But the tide is changing. Of the hundreds launched over the past decade, countless have fallen by the wayside. A handful  – often those with a true point of difference – have become household names.  This innovation has come in many forms and has largely focused on the addition of botanicals and distillates, neglecting the (copper-still-shaped) elephant in the room. “Gin has had a problem that went almost unnoticed for about 250 years,” Cambridge Distillery’s William Lowe MW animatedly tells me. With this declaration, the Master Distiller holds up a miniature replica of a copper pot still and says: “There are six key botanicals that will be in almost every gin you ever taste. And those are: juniper (obviously), coriander, liquorice, orris, citrus and angelica. And there’s a very simple reason for that: two and a half centuries has taught us that they operate really well in this.” He continues, pot still model in hand: “In order for that pot still to work, you have to boil the ethanol at 78.3°C. Water boils at 100°C; so, for distillation to be working, you have to operate between those two parameters. In practice, most of the time you are boiling a liquid around 90°C plus or minus 5°C. The problem with that, is it is really hot. “And if you think about the way a chef would deal with a whole array of different ingredients they have available, there’d be some things they would boil, some things they’d blanch, some things they’d grill, some things they’d cook in an oven at a low heat for a long time or a high heat for a short time, or sometimes a blow torch or sometimes a sous vide or sometimes they just pick, and place, with no heat whatsoever. “A distiller doesn’t have that choice. They have this...” [He holds up the still] “… which runs at around 90°C for an entire day.” When Lowe started the Cambridge Distillery in his front room with his wife Lucy and Labrador Darcy, in 2012, people wrote him off as a kook. His approach of distilling fresh, seasonal botanicals according to their individual needs, rather than all together at extreme temperature, was unheard of. The vacuum still he fashioned is worlds away from the copper pot still in his hand when we speak.  “I can bring the atmospheric pressure down in this unit,” he says with glee, “therefore bringing down the point at which water and ethanol and a combination of those two will boil […] I can literally boil liquids with no heat whatsoever, which starts to sound a bit mad scientist and actually it starts to look a lot more mad scientist. So, what we are able to do, is rather than putting everything into one pot at the same time, we will distil each individual item individually.” In the decade that has followed, Lowe has silenced all his critics. His gins are some of the most highly acclaimed and his distillery is a three-time recipient of the World’s Most Innovative title at the World Beverage Awards. “I’m not innovating here to be different,” he says, “I’ve got no interest in being different. We’re trying to just make things better. And if the optimal approach already existed I’d use it because it would save me a lot of time and energy. Instead, what we do, is we focus on things that have either never been done before or on approaches that have been overlooked by distillers.” These innovations have included the world’s first gin made using solely Japanese flavours, the world’s first gin made out of insects, and the world’s first gin made out of truffles. Lowe has created, and since trademarked, a nine-step approach called a novo-dimensional distillation matrix to extract maximum flavour from his chosen botanicals. He will say two of the variables are temperature and pressure, but the other seven are now a closely guarded secret after gins remarkably similar to his own – but not quite as good, he’s quick to point out – started to appear on the market. Over in Kenya, Procera is a small team adopting another radical approach to produce the first African juniper gin. Distilling legend Roger Jorgensen uses juniperus procera, the native African juniper, and distils it green – as opposed to dried – when it is bright, vegetal and alive. He also uses something other than a traditional copper pot still.  When he was introduced to the 230-litre Müller still, which he affectionately describes as the “Rolls Royce of stills” and his “baby”, Jorgensen says it changed the way he thought about distilling gin – which is quite the claim after a 27-year career in distillation. The Müller still has got infinite controls on it. Instead of a column with bubble plates on it to achieve separation, it’s got 10 metres of 600mm-wide copper plate that spirit and vapour pass over. The column, Jorgensen says, does the work of umpteen plates on another still and gives a seamless separation, driving back dense and heavy flavours, only allowing the brightest ones to come through. Namely, the African juniper.  “The juniper that is used in most gins is harvested and collected at a certain time of year but the highest-quality juniper doesn’t go into distilling,” Procera founder Guy Brennan tells me. “Distilleries are not paying the highest money. The best juniper in the world goes into food and grain stuff. And then you go down a few ranks until you get to the juniper that gets used for distilling.” Procera is the only company using the native African juniper, which Brennan says is “grade one” instead of the “grade three or four” in other gins. It is his hope that other distillers will follow suit and African juniper can become a cash crop like tea or coffee. “At the moment, African juniper has a zero dollar value, but it could be worth £100m in 10 years,” he says. “If Beefeater make an African juniper gin then there is £10m of juniper and the money goes straight to the people on the ground.” The idea to create the world’s first African juniper gin came to Brennan when he was sitting around drinking Bombay with friends. After taking a closer look at the bottle they’d held many times, Brennan and friends were struck by the irony that many of the botanicals, which hail from Africa, are shipped to London for somebody to distil and sent back to Africa as a finished product. Brennan then found Jorgensen – who he playfully calls the “distilling Yoda” – and both discovered juniperus procera. While botanicals are often the most talked about thing when it comes to gin – there’s almost a game of one-upmanship at times with who can use the most or the most extreme – few, if any, talk about the juniper, which legally has to be the prominent flavour. “We don’t want to speak negatively about other companies,” Brennan continues, “but you just don’t hear much about the juniper and there’s a reason: it all comes in 50kg bags from a commodity broker, rather than anyone having a true connection to it. Juniper makes up 90% of a gin and it should be that terroir, rather than a chilli or a citrus botanical, which defines the gin.” African juniper berries grow on a tree – rather than a bush – that is between 10-15 metres in height. The tree, which lives for hundreds of years, only grows at high altitudes (above 1,500 metres) around the equatorial zones. You can tell the juniper is in season, at the end of the short rains, when the baboons start eating it. It is earthier and nuttier than the more commonly used European juniper, juniperus communis. “If you think about it, the best juniper comes from the Mediterranean south, it doesn’t come from the Black Forest or even Scotland because it gets more sun,” Brennan says. “It’s like tomatoes from the Mediterranean: more sun, more flavour, more richness – it’s the same with juniper as well.” In addition to distilling the native juniper green, Jorgensen adopts a pillowcase technique. The Master Distiller finely grinds the botanicals and puts them into a pillowcase and soaks them in warm alcohol overnight. This “grown-up teabag” extracts the primary terroir flavours, and ensures they aren't lost during the distilling process. At Cambridge Distillery, Lowe is a staunch advocate for terroir – or as he terms it, typicity – in spirits. “The difference between the good and the great wines really is the notion of typicity and expressiveness and a sense of place and that’s universally true,” he explains. The Master Distiller points to Champagne, Burgundy and Bordeaux, and the rare whisky gems from Islay, Speyside, and more nuanced examples from Japan. “And then gin,” he says with a mischievous smile. “Well here’s a problem: juniper, coriander, liquorice, orris, citrus and angelica – there is no one place where all six of those things grow. And yet, if you just go and grab a bottle from the supermarket it will be made from juniper, coriander, liquorice, orris, citrus and angelica. Why?” He holds up the miniature copper still model. “So here we have a confirmation of our process and our philosophy. Our philosophy was simple: why can’t you make a gin that’s really from a place? And just because no-one had, it didn’t mean it couldn’t be done. It just meant no-one had done it yet.” The team at Procera is equally determined. “I’m an irreverent person,” Brennan says with a laugh. “Roger’s an irreverent person, and the team, we’re irreverent. We don’t just say let’s do things the way everyone is doing it. Because why would we use European juniper? Why do we use dry juniper? Green juniper is fundamentally better. Fresh products make better gin.” Brennan says he hopes others will adopt the same logic when they see the quality of the product and consumers’ willingness to pay more than the current glass ceiling of £40 per bottle. Something Lowe echoes: “This isn’t stuff that is being dreamt up around a boardroom. And we’ve never been in a position where we’re working down to a price point. We work up to a quality point and that’s it. “It does have the side effect that a lot of our products are more expensive than the contemporary set of gins that are out there but I’ve never been of a mind to dictate to people what’s too expensive. “I think that’s been what held these guys back for a really long time,” Lowe says with the pot still aloft. “If you ask everyone out there: are you making the best decision or are you making the most economically viable decision? They have got to be honest about it. “Flavour is a fashion. Quality is an enduring feature. And there will always be those who graduate out of these fashion cycles and come and seek quality. “I’m not in any way intimidated by what other people do around the gin industry. Either it will be part of the fashion trend, which is not our natural ecosystem, or they will join us on our mission to improve quality – and that’s got to be a good thing, hasn’t it?” Browse our range of gins or read more Editorial

Old, low-yielding vines. I’ve written that phrase more times than I’d like to confess. But how much does it really mean when it comes to the quality of the wine in your glass? The 2023 vintage in Burgundy (read our full vintage report here) produced generous yields. In farming terms, that’s a good thing: a plentiful crop that restocks the cellars (and coffers). But the sheer volume of fruit (“a wall of grapes”, as Bouchard’s winemaker Frédéric Weber told us) posed its own challenge – and much of our time in the region’s cellars this year was spent diving into how they managed, or controlled, the yield. It seemed fitting, therefore, to address the topic in greater detail.  In the Old World, appellation rules will limit yields, with the yield generally decreasing as you move up the appellation system (see below a table detailing the maximum yields for Burgundy, for example). Of course, this indicates a relationship between yield and quality, implying less is better – and there is no doubt that excessive yields don’t produce fine wine. But how low is too low? There is a fashion for prizing vines that barely manage to ripen a bunch or two, but do they really make better wine than those producing a decent crop? Beyond our obsession with rarity, what are the consequences of less fruit per vine – and therefore, what does more entail? A note on measuring yield Before we get into the weeds of the matter, let’s address how we talk about yield. In the Old World, the most common measurement of yield is hectolitres per hectare (hl/ha), measuring the volume of juice or wine per hectare of vineyard area. In Champagne the standard measure is kilos per hectare and in Italy you may see reference to quintales per hectare (qt/ha or q/ha, with one quintal translating to 100kg), while in the US, producers are more likely to use tons per acre. We’ll dive further into the many variables here, but it’s worth highlighting that vine density isn’t taken into account by any of these measurements. Although a higher number of vines per hectare will generally mean a higher yield across the vineyard, the increased competition will also likely reduce the yield per vine. For this article, we have spoken to producers from a range of regions, but do note that yields are not comparable between varieties or region. Climate – with heat, sunlight and water availability, as well as the varying size of berries and clusters of any given variety, mean that there is no number that can be deemed a global average when it comes to yield. (Do look at this table compiled by the Wine Advocate’s William Kelley, comparing vine density, cluster weight and juice yields for various classic fine wine regions, to give you an idea of the differences between regions.) Given this, “high” and “low” yields aren’t equated to specific numbers here, but the concept discussed more broadly – and arguably more relevantly for those of us drinking wine rather than making it. Bearing all of this in mind, extremely approximate conversions can be made as follows: one tonne per hectare is approximately 7hl/ha, while one ton per acre is around 17.5hl/ha (Oxford Companion to Wine). Yields: how low is too low? “It’s not extreme mythology: low yields produce better quality,” Cerbaiona’s Matthew Fioretti tells me; for him, high yields risk dilution and sanitary problems – and at excessive levels, that is certainly true. But, as Myriad’s Mike Smith told me, the relationship is “not linear”. Mike Dunn (Dunn Vineyards) generally has low yields, but that’s not necessarily about concentration, he explains: it’s simply about how much they can ripen before winter hits. Up on Napa’s Howell Mountain, their poor soils and farming (avoiding irrigation and fertilisation where they can) naturally produce lower yields. He recently changed some of their Cabernet Sauvignon to cane (rather than cordon) pruning and, although they’re getting more fruit off the same vines, there’s been no loss in quality. “It’s all relative,” says Ivan Massonnat at Belargus in Anjou. He points to Saumur with its limestone soils, where producers can crop 45-50hl/ha without a problem, but on the schist soils that lie beneath his vineyards: “Forget about doing much more than 30-35hl/ha,” he says. And even that has proven challenging for him. In the seven vintages he’s produced at the estate, only two have come close to 30hl/ha, with the average around 15hl/ha, simply due to the challenges of each vintage. He’d have loved to crop more – but nature had other ideas, and vignerons have to adapt to the vintage. Massonnat explains how if you farm to produce yields that are overly low, you can end up with fruit that has high technical, or sugar, maturity, but isn’t yet phenolically ripe – leading to unbalanced wines. Smith echoes this, talking specifically about Beckstoffer Dr Crane, one of Napa’s legendary vineyards, which he finds likes to produce more – around five tons an acre (versus four in most of the vineyards he works with). He sees producers cropping to just three tons per acre there, and in warm vintages the fruit ripens too quickly for the phenolics to catch up. Philippe Bascaules – who was first appointed Estate Director at Ch. Margaux in 1990 – offers an interesting perspective, arguing that there’s no direct relationship between yield and quality. In Bordeaux in the 1970s, he tells me, yields were consistently low – 25-30hl/ha, with wines that were inconsistent. As the wines became more popular, with demand from the US in particular for the 1982 vintage, producers started aiming for significantly higher yields and chaptalizing much more. Soon, average yields had doubled to 50-60hl/ha – a level that was unsustainable, especially in challenging vintages such as 1992, ’93 and ’94. Gradually they implemented changes, introducing green-harvesting (in 1986 at Ch. Margaux) and reducing fertilisation levels in the 1990s. Today, he and his team aim for around 45hl/ha, “a good production” in his mind – but a level which also offers insurance against inclement conditions. Lowering yields is something that, for him, has brought greater consistency to both the estate and region across vintages – ensuring they can ripen the crop each year. Deliberately reducing the yield beyond this, however, wouldn’t offer any serious benefit, he says. Similarly, across the Durantou family’s estates on the Right Bank, including Ch. l’Eglise-Clinet, Noëmie Durantou Reilhac targets a yield of circa 42hl/ha. “The vine wants to produce fruit,” she says, “so if the yield is really, really low, something went wrong.” For her, it’s the balance that matters most. With very high yields, the resulting wines will lack concentration (“You cannot make in tanks what nature hasn’t done before,” she says), but equally if the berries are so small that there is barely any juice, you’ll have little but tannins left to work with. And, while hail or frost will reduce your yield, they won’t result in greater concentration. “I think it just comes down to stress,” Dunn tells me. And that’s a common thread for several producers, arguing that vines need to struggle to produce quality. As Sébastien le Golvet – of Champagne Henri Giraud, who works with the poor soils of Aÿ – says, “genii are born of suffering”. Suffering doesn’t always mean lower yields, however: arguably, Dunn says, in high-vigour sites, keeping higher yields will help increase stress, pushing the vine to work harder – and therefore produce higher quality. Elements impacting yield While it’s impossible for us to address every factor that influences yield, it’s worth – relatively briefly – highlighting a few additional influences beyond site (with poorer or richer soils), variety and vintage: Trellising: Trellising – the shape in which a vine is trained – can be used to control yield. At Cerbaiona, Fioretti emphasises how using alberello or bush vines is key to helping contain Sangiovese’s natural vigour. At Tiberio, Cristiana Tiberio’s oldest vines are pergola-trained, with a traditional Abruzzese system that encourages competition but also increases the canopy to aid photosynthesis and ripening. Vine material/rootstock: The material used in a vineyard is integral (as with Quinta do Noval’s Nacional vineyard, see below). Mike Dunn, for example, mentioned how one of his older vineyards was planted on St George rootstock, known for shatter and therefore limiting yields even further. Jean-Marie Fourrier (Domaine Fourrier) argues that the use of selected clones, rather than massal selection, has resulted in higher yields and the need to green harvest, something that he never does – aided further by the age of his vines (see below for more on this). Vine age: There’s no doubt that the element of vine age is conflated with yields and quality, with older vines often producing better fruit – but less of it. As Mike Dunn told me, the wines from his oldest vines are “more intriguing”, but at some point economics comes into play, and the level of production is financially unsustainable. It’s another non-linear relationship, however, as Durantou Reilhac explains: “Some 70-year-old grandmas can run and dance, and others are weaker.” Although most old vines will produce less fruit, she finds it’s far from uniform in her vineyards – and sometimes there will be young vines that produce less. Virus and millerandage: Virused vines will produce lower yields, and as with old vines, will reach a point where they are unsustainable. While on the surface virus is negative, certain producers do value the reduction in yield or slower ripening that is a result of disease – South Africa’s Hamilton Russell being one (with leafroll virus). Quinta do Noval persists with its own-rooted Nacional vineyard, suffering from phylloxera, with the vines slowly dying and yielding tiny volumes, to produce a particularly special and rare Vintage Port. Similarly, millerandage is a condition most commonly a consequence of poor weather at fruit-set, producing grape clusters with unevenly sized grapes, combining larger and smaller (or shot) berries – sometimes referenced as hen-and-chick. While this reduces yield, the phenomenon is sometimes valued for giving increased concentration to wine. Indeed, some particular clones – such as the Mendoza, Wente or Gingin clones of Chardonnay – are valued for their bunches with hen-and-chicks, and Bret Brothers, for example, even makes a special Cuvée Millerandée – with millerandée Chardonnay – from Les Quarts (a Pouilly-Vinzelles site recently awarded Premier Cru status). Cover crops: At Henri Giraud, Sébastien le Golvet feels that cover crops are essential to the quality of their fruit – and the yield. Sewn just before harvest, the cover crops provide competition up until flowering when they roll the grass mix, creating a bed that holds water and offers nitrogen to the soils, acting as a natural fertiliser – in a way both moderating then fuelling the vines’ growth. This is one hint at the extent to which the type of soils and level of organic matter, not to mention water availability, dictated by site and the farming methods, are all key. The previous vintage: There are two theories at play here. Firstly, conditions during what is known as the initiation phase of the vine cycle, which takes place alongside flowering, will dictate the yield of the following vintage. In 2023 in Burgundy for example, one of the factors in yield was that the spring of 2022 offered perfect conditions, laying the groundwork for 2023’s plentiful crop. As Sébastien le Golvet also explained, however, a large crop in one vintage can tire the vines, meaning they have less to give the following year. How wine producers manage yield The vine naturally wants to reproduce, to grow, ripen fruit and spread its seeds. Vignerons are tasked with taming the plant to focus its energies to develop fruit of concentration and complexity that will make fine wine. This is done in many ways, some of which include: Pruning: The first stage to set up the yield in an existing vineyard is pruning, leaving the appropriate number of buds per vine for the season ahead. The timing of this varies according to the producer, from December through to March, with later pruning helping delay the vine cycle, which is sometimes desirable. Alvina Pernot, for example, specifically pruned her vines shortly (ie to offer a lower crop) in 2023 to help the vines recover from the relatively high-yielding 2022 vintage. Lalou Bize-Leroy famously works with very low yields, and emphasises how important pruning is in this (Domaine Leroy harvested just under 30hl/ha in 2023, its highest ever yield – a number which would still be low by many producers’ standards). De-budding or suckering: In spring, producers will de-bud or sucker the vines, removing lateral shoots and providing further control of the potential yield, as well as the spacing and position of the crop. In 2023 in Burgundy, many producers emphasised how important this was. Hugues Pavelot described it as “drastic”, while Philippe Jouan passed through his vines twice. At Bouchard, Frédéric Weber explained how some of the buds produced two or three bunches in 2023 (rather than the normal one), meaning that even with extensive de-budding yields were very high. Green harvesting: Green-harvesting is the most discussed method of yield control, and one that divides producers. We spoke to several Burgundian vignerons who avoid it (Dominique Lafon, Jacques Devauges at Domaine des Lambrays, Philippe Jouan and Jean-Marie Fourrier, to name a few) – some of whom felt that they had no choice but to use the method in 2023, despite their best efforts. The reason against green-harvesting is that the vine will try to compensate, and that it can be avoided with managing the vineyard in other ways. That said, there are many top-tier producers that green-harvest, and feel it is key to the quality they produce (Ch. Margaux, Eglise-Clinet, Georges Noëllat and Olivier Bernstein, to name a few). And it’s not a decision that any take lightly, well aware that they are literally throwing away potential income. At Cerbaiona, Fioretti compares the vines to runners or cyclists – needing to carry as little weight as possible to get over the finish line. With Sangiovese, he finds it’s unavoidable, especially with the presence of “wings” or “shoulders” (smaller separate clusters that sit on the shoulder of the main bunch). The timing is key, and many producers emphasise the importance of green-harvesting early in the season. For Noëmie Durantou Reilhac, she aims to have this done prior to véraison to avoid twisting the stems (which would impact sap flow) and damaging the skins of the remaining bunches. She’ll do a final pass through her vineyards just before harvest, but this is a method of sorting rather than impacting the ripeness of the grapes on the vine. “There’s a certain point where you can reduce fruit, say a month away from picking, but it won’t do anything,” says Myriad’s Mike Smith. Like many producers, he favours green-harvesting mid-véraison to drop anything that is behind, helping even the ripeness of the crop – as Bascaules does at Ch. Margaux. In 2023, several Burgundy producers highlighted having to do multiple passes to reduce the crop – doing what was sometimes referred to as a “pink” or “blue” harvest on top of a green harvest. Canopy management: A vine’s leaves are its engine – responsible for photosynthesis. The larger the canopy, the larger the engine, therefore trimming the vine’s canopy can help lower its vigour, while keeping a larger leaf area can help encourage vigour. This needs to be considered alongside airflow (to avoid disease pressure) and shading of the bunches (which could delay ripening). If the canopy isn’t balanced with the volume of fruit, it can also negatively impact fruit composition – especially the acid make-up and development of colour and phenolics. Ivan Massonnat (Belargus) explained that in 2022 and 2023, for example, he used a high trellis, allowing a larger leaf area, to capture maximum light and photosynthesis to fuel the vines; but in 2022 he did the opposite, wanting to reduce the size of the “sugar machine”. It has, he notes, become common for large canopies to be used alongside low yields, especially by producers in Burgundy, something he feels has gone too far at certain addresses: “You can kill a wine with concentration,” he says. Some argue that trimming the canopy can encourage it to grow further, while others want to retain a large canopy to encourage root growth (Olivier Lamy feels that the vine has the same amount of growth above and below ground, therefore wanting to retain his canopy to the roots to drive deep into the soil). Lamy is one of a cohort of producers using “tressage”, or braiding, to tame the canopy – a technique pioneered by Lalou Bize-Leroy. For her the aim is to avoid cutting the apex (or growing tip) which would otherwise encourage the growth of lateral shoots. Producers such as Charles Lachaux have taken this even further, training vines to a single stake (more common on the steep slopes of Priorat, Côte-Rôtie or the Mosel) and weaving the shoots into distinctive arches.  The relationship between yield and quality is undoubtedly a tricky one – and one that every producer I spoke to feels is deeply complex. We couldn’t touch on everything here (the tiny yields for botrytised sweet wines, for example, or typically higher yields used for sparkling wine), but there’s plenty to consider. While it remains clear that excessive yields can produce dilute wines, with so many variables play, it’s also clear that less isn’t always better. Read more Editorial

Yield and quality: is less really more?

Everything about Glenfarclas is venerable. For almost 200 years, the distillery with one of the most enviable addresses in Scotland has remained fiercely independent and committed to quality. Where countless others have amalgamated and joined behemoths of the industry, Glenfarclas has remained family-owned – amassing enviable stocks of aged single malt in the process. Today, the sixth generation of the Grant family maintains many traditional practices, including direct firing its stills, to produce the highest quality, full-bodied sherried Highland single malt possible. This resolution and myriad difficult decisions made by the family during times of immense hardship have led to genuine innovation and secured Glenfarclas a place as one of the most coveted and collectable names in Scotch whisky. But just how has one of the only family-owned Scottish distillers become such an icon and which Glenfarclas bottlings are the most highly sought after? The history of Glenfarclas The Glenfarclas distillery was built on the River Spey in 1836 when Robert Hay was granted a licence to distil whisky. Cattle breeder John Grant took over the farm and distillery following Hay’s death for 511 pounds and 19 shillings and leased it to John Smith who left five years later to build Cragganmore. The site passed between Grant generations until the Glenfarclas-Glenlivet Distillery Company was formed with Pattisons of Leith in the 1890s. This partnership wasn’t to last long and Glenfarclas was fortunate to weather the Pattisons Crash in 1898 that threatened to bring the entire industry down with it. The distillery has firmly remained under the Grant family’s ownership since. George Scott Grant is one of the key figures in the distillery’s long history. During his 52-year tenure, which ended with his death in 2002, George built up Glenfarclas’s name and brand image. George had the foresight to restrict the supply of stock to blenders and squirrel away stocks. This decision has proven extremely lucrative as Glenfarclas now boasts a depth of stock that few other whisky distilleries can rival. John L. S Grant, the current chairman, has been with the company since 1973 and succeeded his father in 2002. The sixth generation is represented by George S. Grant who joined Glenfarclas in 2000. George works as the larger-than-life global brand ambassador, introducing the world to the remarkable Glenfarclas story and spirit. The distillery’s fortunes oscillated throughout various whisky booms and busts. Production has increased, been scaled back, and considerable stock laid down when times were hard. Throughout all this, the Speyside distillery can legitimately lay claim to a series of firsts – it was one of the first single malts to be consistently available when others were concentrating on blends and it was among the first Scottish distilleries to open a visitor centre. It was also the first to introduce a cask-strength single malt whisky. Today, Glenfarclas operates the biggest stills in Speyside and its Highland single malt accounts for two-thirds of the distillery’s annual production – sold in more than 90 markets worldwide. Glenfarclas’s distillery character The distillery, located one mile from the River Spey, is situated on a stretch of land that boasts the likes of The Macallan,  Balvenie,  Glenfiddich and Aberlour. The distillery sources its water from the neighbouring Ben Rinnes mountains. Glenfarclas is famed for its full-bodied, Sherry-matured expressions. The distillery only releases expressions at natural colour, often at cask strength, aged for extended periods of time. The unique still shapes and sizes, alongside the traditional ingredients and distillation techniques add to the distinctive distillery character. Glenfarclas new-make spirit is only ever matured in a combination of first-fill and refill ex-Oloroso casks from the highly regarded José y Miguel Martin. John Grant makes an annual pilgrimage to the bodega in Jerez to ensure his Highland single malt will eventually slumber in the finest quality oak. To this day, all six of Glenfarclas’s stills, which are the largest in Speyside, are direct-fired. The distillery team experimented with steam heating in 1981 to no avail as the family believed the final product to be inferior and lacking its characteristic full-bodied style. The distillery is capable of producing approximately 3.5 million litres of spirit annually. Normally, two of the stills are kept in reserve, while four work around the clock. Glenfarclas single malt whiskies Glenfarclas has consistently released single malt whiskies of exceptional quality from its enviable stocks. The Grant family has more than 50,000 casks slumbering in its expansive on-site warehousing at any one time to draw from. In 2007, Glenfarclas gave the world a glimpse at its incredible depth of stocks with the first release of its highly collectable Family Casks bottlings. The series of 43 (and counting) single-cask, vintage single malts spans seven decades and is highly sought after by whisky lovers. In addition to the limited releases, Glenfarclas bottles a “made to age” core range, which includes the 10 Year Old, 12 Year Old, 15 Year Old, 17 Year Old, 21 Year Old, 25 Year Old, 30 Year Old and 50 Year Old. The distillery also produces an incredibly popular cask-strength bottling named “105 Cask Strength”. Some of the most collectable Glenfarclas bottlings Notable limited releases include the Glenfarclas 50-year-old (released in 2005) and the 175th anniversary commemorative bottling, released in January 2011. The latter was an impressive vatted whisky from casks from 1952 and five successive decades. In June 2015, Glenfarclas launched the highly collectable limited expression £511.19s.0d Family Reserve to mark 150 years of the Grant family’s ownership of the distillery. The bottling was named after the amount (511 pounds and 19 shillings) John Grant paid for the Glenfarclas farm in 1865, and came with a copy of the original bill of sale for the distillery. One of the most remarkable limited releases is the Glenfarclas Family Trunk, released in 2018. Only 60 of the leather shipping luggage trunks containing 50 bottles of 200ml single malt from the Family Casks collection, dating back to 1954, were ever produced. Today, a single trunk, available to purchase from the distillery, costs £120,000. In 2020, the distillery released another highly collectable whisky for the Spirit of Speyside Festival, which was cancelled due to the global pandemic. Each year, a member of the team chooses a spirit to be bottled for the annual whisky celebration. In 2020, the responsibility fell to the men behind the still, and The Stillmen’s Dram was born – a 10-year-old matured in a first-fill Oloroso butt, bottled at cask strength. The Glenfarclas Family Casks Collection The Glenfarclas Family Casks collection is a highly collectable series of single cask bottlings from the family’s extensive stocks. Since the first bottle was released in 2007, the Family Casks whiskies have garnered a loyal following and become a real collectors’ item. The single-cask whiskies, which span seven decades, are some of the finest expressions from each vintage since 1954. Glenfarclas Pagoda series The highly collectable Pagoda series features two of the oldest Glenfarclas whiskies ever released. The extremely limited vintage whisky bottlings are inspired by the famous pagoda kiln which was decommissioned at the distillery in 1972. Each Glencairn crystal decanter is a unique work of art. No two are exactly the same and each element – from the side graphics to the exquisite pagoda stopper – have been painstakingly crafted. The Glenfarclas Pagoda Series is available in extremely limited quantities. Only 180 bottles of the 1954 vintage Pagoda Ruby Reserve (62-year-old), and 1953 Pagoda Sapphire Reserve (63-year-old) were ever made. Everything you need to know about Glenfarclas

Unlike many wine-lovers, I came across Occidental before Kistler. I worked for a company that imported some of its early vintages – and they were like nothing I’d ever tasted. These translucent Pinot Noirs glimmered, but their pastel-pale shade was nothing but a nudge and wink at the Burgundies that inspired them. Aromatics leapt from the glass – floral and febrile, but it was the vivid, intense, crystalline purity of the palate that I found so beguiling. Seeing where these wines are made – on the brink of the Pacific, where ocean breezes lash at the vines, and thick fog grasps the dramatic, undulating landscape – only made them all the more enchanting. Even today, 18 years after Steve Kistler first put down vines here, the region is sparsely planted – with Occidental one of a handful of pioneers of the outer reaches of the Sonoma Coast. The area was long deemed too cold to ripen fruit, with dairy the main industry – and fields of grazing cattle and sheep are still interspersed with plots of vines. Occidental’s vineyards – now 85 acres in total – now neighbour those of Platt, Littorai and Joseph Phelps’s Quarter Moon site, sitting at 500 feet above sea level – a modest altitude when you consider some of Napa’s mountain districts have parcels above 2,000 feet. But it’s their proximity to the ocean (which is just five miles away) that makes the climate here so cool – and damp. Leaf-pulling and spraying are key to managing disease pressure – unfortunately making organic farming almost impossible. “We want the purity of fruit to shine,” Catherine (Cate) Kistler says. She joined her father, Steve, six years ago, working as his Assistant Winemaker – just one element that makes the venture a true family business. Not in the way that Walmart or Ford are a family business, but in the hand-to-mouth, everyone-mucks-in, this-is-both-their-livelihood-and-legacy kind of way. It’s a “tight little universe” where they work, live and farm, Cate explains. This is one reason that Steve stepped away from the iconic winery that he’d created in 1978 – Kistler had shifted and grown, becoming something larger than he’d ever anticipated, or necessarily wanted.  Kistler had humble beginnings – with Steve making the wines in what was essentially a wooden shack, and living upstairs. That building – up in the Mayacamas – was consumed by the fires in 2020, and today Kistler works with around 300 acres (including their own vines and those farmed by growers for them). The investment of Bill Price (a man whose first major move in the wine industry was buying, and later selling, Beringer) has added further gloss to a winery that has become one of California’s cult names. If that makes it sound like there’s been wholesale change, that’s far from the truth – a clear succession plan has ensured only the gentlest of evolutions at Kistler, and ensured the producer maintains its position at the top. Jason Kesner – who describes himself as a “vine and yeast shepherd” – is the man at the helm today. He joined the team in 2008 (aged 40), working alongside Steve for close to a decade before taking the reins.  Although born on the East Coast, Kesner grew up around wine. He moved out to California aged eight, where his mother had taken a job as Head Microbiologist at Robert Mondavi, and his soon-to-be stepfather worked as VP of Vineyard Operations – the smells and sounds of a working winery firmly familiar. Despite his early initiation to the industry, he studied cultural anthropology and left both the area and industry. He was eventually lured back, working first for Francis Ford Coppola (the man behind Inglenook’s revival), but in a non-wine role – managing his special projects. Via Coppola’s poker games, Kesner connected with Pat Kuleto and ended up planting vineyards for him, before finding himself at Hudson (his “graduate school for Chardonnay production”). This prestigious name features on bottles from the likes of Aubert, Kongsgaard, Cakebread, Failla and Ramey – and Kesner got to work with all of them, growing top-tier fruit for 34 clients, including Steve Kistler. And Steve was different. He was, Kesner says, “very, very focused”, “hyper-intelligent, borderline genius” and – along with his business partner, the late Mark Bixler – thought about things on a different level. When the duo started Kistler in the 1970s, working with a single clone and single sites, no one else was doing it – with his unparalleled energy and intent, Steve created something profound. Although Kesner had already worked closely with Steve at Hudson, it was only when he arrived at Kistler in 2008 that he realised how differently Steve operated. “I had jumped into a different timeline and a different pace,” Kesner tells me. “Steve and I had conversations that, quite literally, spanned years.” These conversations would be picked up each vintage, just a handful of sentences on a topic expressed until the next season. For Kesner, this long-term vision was what set Kistler apart: “It’s not about the people who are doing it at the moment. It’s about everything that’s come before and it’s about everything that will come after.” The Kistler evolution has been slow, but it has happened – past their phase of “embracing the cocaine ’90s” (“If you weren’t, you weren’t paying attention,” Kesner says), with a shift toward earlier picking, native ferments and reduction in new oak (from 50% down to around 38% across the range today) – but without sacrificing the seductive, silken style that defines their Chardonnay. “Our job is to polish the jewel,” Kesner says. “The diamond doesn’t need to be re-cut.” The vines are also gradually gaining in age (currently averaging a spritely 35 years), which is only improving the wines further. Kesner is continuing Steve’s work and the philosophy remains true to the original concept. “The best and highest use of a given site is when you're guiding it, not driving it,” he says, pointing to Mother Nature (rather than Bill Price) as the ultimate boss. He loathes the title “winemaker” – fully aware that it’s an entire team behind Kistler. “There are 56 people who are dedicated to the production of these wines. They’re out there pruning in January and then they’re going to be out there picking for this year in October. And it’s because of that really powerful group of people that we’re able to do what we do.” Meanwhile, out on the coast, Steve is continuing his own quest for terroir. Occidental, Cate tells me, is all about exploring “what this ridge means”. The yields at Occidental, overlooking the Pacific, are tiny, maxing out at around two tons/acre. The work is painstaking, with careful canopy management and spraying to avoid mildews, and steep slopes that need to be hand-hoed to manage the weeds. And, as at Kistler, the Pinot Noirs here are all made identically – so it is the site, rather than hand of the maker, that shines through. Be that though it may, it takes exceptional talent to make wines like this. “[Steve] is yet again 30 years ahead of everybody in California,” Kesner says. “It might take the American palate a while to catch up with them, but I firmly believe those will be recognised as some of the best Pinot Noirs in the world. Hands down.” Steve’s an elusive character – and seems happiest tucked away in his remote corner of the Sonoma Coast, away from the limelight. “He’s not a man of many words,” Kesner says, although suggests that working with Cate has drawn him out of his shell a little. Cate talks about him unsurprisingly lovingly, but doesn’t shy away from admitting there are challenges to the “weird and wonderful world” of family business. Harvard-educated, she’s quick-witted and sharp, and has clearly inherited her father’s passion for wine. Not only is he clearly deeply embedded in everything Occidental, but his interest goes beyond vine-growing, with what I suspect is an enviable collection of his own, from the alluring line-ups of Grand Cru Burgundy that I’ve glimpsed on Cate’s Instagram. It takes something rather extraordinary to be willing to give up your name, to start from scratch, all over again, with a new winery and new vineyards. But there’s a reason that his longtime vineyard manager (Ruben Molinar) and cellar master (Raymundo Abarca) left Kistler with Steve in 2017; and it’s a tribute to the man. Now Molinar and Abarca’s children are working alongside Steve’s – and the family is growing. But Cate and Steve don’t want to create Kistler 2.0. They’re developing another ranch, but they don’t want the project to become so big that they’re no longer doing most of the work themselves (“We’ve seen that movie,” Cate jests). The first vintage of Occidental was only 2011, but the wines are already making their mark. Steve’s legacy at Kistler lives on, safely being shepherded by Kesner and his team, but it’s also being re-born at Occidental, and set to be carried forward by Cate. “Wine is my dad’s world,” Cate tells me. Bordeaux has several different classification systems. While the Right Bank has only Saint-Emilion’s system (one that is a source of controversy), the Left Bank has a more complex web of rankings.   
The 1855 classification is the gold standard. The most famous and influential of them all, it lists the Left Bank’s very top estates. But beyond this crème de la crème, there are several other systems ranking properties – namely the Graves classification, the Crus Bourgeois and Crus Artisans.  
The Graves classification  
Almost 100 years after the famous 1855 classification, producers in the Graves decided to create their own equivalent. Other than Ch. Haut-Brion, the region’s properties had not been included in the 1855 classification. A draft of the classification was drawn up in 1953, then the official list ratified in 1958, with some changes in 1959.  
The Graves classification is much simpler than the 1855 classification. There is only one tier, with estates declared “Grand Cru Classé de Graves” for white wine, red wine, or both. Sixteen estates in total were defined as the region’s best. Couhins, Couhins-Lurton and Laville Haut-Brion were classified for only their white wines, while Fieuzal, Haut-Bailly, Haut-Brion, La Mission Haut-Brion, Pape-Clément, Smith Haut Lafitte and La Tour Haut-Brion were classified only for their reds.  
Interestingly,. Ch. Haut-Brion is only classified for red, however this is not because its white was not deemed worthy, but because it did not apply for classification, given production of the illustrious wine is so small. It remains one of the region’s highest-rated and most expensive whites. 
Although there have been no changes since 1959, some of the wines are no longer made under the same name. Both part of the Clarence Dillon family, Ch. Laville Haut-Brion is now bottled as Ch. la Mission Haut-Brion Blanc, while fruit from La Tour Haut-Brion is now used for the second wine of La Mission, La Chapelle de la Mission Haut-Brion (read more about the genealogy of the Haut-Brion estates here).  
The Pessac-Léognan appellation was only introduced in 1987, so some of the wines are bottled under this today.  1959 Graves classification  Ch. Bouscaut (red and white)  Ch. Smith Haut Lafitte (red only)  Ch. la Tour-Haut-Brion (red only)  The Crus Bourgeois  The term “Cru Bourgeois” has long been used casually, but it was introduced as a formal classification in 1932. There have been many changes to the classification over the years. There were 444 properties in the original group, many of whom used the term on their labels even though the classification was never officially ratified. In 2003, after three years of debate, the classification was updated and split into three tiers (with Cru Bourgeois Supérieur and Exceptionnel added), only to be annulled in 2007, with the term then banned from labels. In 2010, the Cru Bourgeois classification was re-introduced and assigned to wines rather than estates, with their status re-assessed each year, but this too was soon replaced.  
In 2020, a new version of the classification was unveiled, going back to the three tiers of Cru Bourgeois, Cru Bourgeois Supérieur and Cru Bourgeois Exceptionnel. The top rank of “Exceptionnel” includes just 14 estates, with 56 Crus Bourgeois Supérieurs and 179 Crus Bourgeois (adding up to a total 249 properties). The classification is only being assessed every five years, with the next iteration set to be announced in 2025.   
The classification is decided based on the quality and consistency of the wine (assessed via rigorous blind tasting), traceability and authentication, with sustainability encouraged and rewarded. While these wines are not as highly regarded or sought after as those in the 1855 classification, the wines generally offer good value, and all come from the Médoc, Haut-Médoc, Listrac, Moulis, Margaux, Saint-Julien, Pauillac and Saint-Estèphe. The Crus Artisans  
The Left Bank also has the Cru Artisan classification, designed to highlight smaller operations where the manager/owner is involved in every stage of production. The term has been used for over 150 years, however its official meaning was introduced in 1989. The classification was launched in its current guise in 2006, open to estates in the Médoc, Haut-Médoc, Listrac, Moulis, Margaux, Saint-Julien, Pauillac and Saint-Estèphe. Generally family-owned, properties must grow their own grapes, then make and sell the wines.  
There were 44 Cru Artisan estates in 2006, but the latest classification (unveiled in 2018) included only 36 – with many addresses sold/absorbed by other producers, some retiring, as well as a handful of new names added. The classification is based on a visit to the estate and blind tasting of its wines. On average, Crus Artisans have just 10 hectares of vines.
