Valpolicella from maestro Romano dal Forno   February sees the annual release from Valpolicella’s pioneering Dal Forno estate. The sad news is there will be no new Amarone release this year. The 2014 vintage was difficult across Italy and Dal Forno was hit badly by hailstorms in June which only reduced the yield further. The grapes were deemed too fragile to undertake the long two-year drying process necessary for Dal Forno’s Amarone. The silver lining is that the top fruit went into their Valpolicella Superiore, which is already a canny buy in any year. The production of the Valpolicella is 30% down on normal years so it will be in short supply. To make up for the lack of a new Amarone release, the winery will be releasing a rare set of Amarone magnums from the 2011 vintage – one of the finest in the winery’s history. Look out for them later this month.  The king of kings: Château Latour’s first 2016 release  Pauillac de Latour is the ever-popular “third” wine from the First Growth Bordeaux estate Château Latour. The wine captures the purity and precision that defines Latour, but with a softer, more approachable structure, allowing fans of the estate to enjoy an earlier-drinking offering at an enticing price for the pedigree. The 2016 vintage, now in bottle, is widely acclaimed as one of the greatest modern vintages of Bordeaux, which only makes the release more exciting. Latour 2016 was without question one of the top wines of the vintage, awarded 100 points across the board from the world’s leading critics. This sibling, made by the same team, offers an affordable and approachable insight into this extraordinary estate and vintage.  The latest from Madame Lalou Bize-Leroy   The annual release from Leroy will be out this month. Exact release dates are never disclosed but we are expecting to see them any day now. The Maison wines will be released first, followed by the domaine wines from d’Auvenay later in the month. While we can’t confirm exactly what will be available, we can disclose that the selection this year has some exceptional vintages from some of the region’s top villages. Alsace – Olivier Humbrecht Food and wine are taken very seriously indeed in Alsace and Olivier has provided a wealth of options to consider. Worth noting, Alsace has more Michelin-starred restaurants than anywhere else in France. Top recommendations for wine lists at reasonable prices in the region are Tavernes lsacienne in Ingersheim and Restaurant de la Gare in Guewenheim. The best for food /wine list combo would be Villa Lalique in Wingen sur Moder, Chambard in Kayserberg. Table du Gourmet (1 Michelin Star) in Riquewihr and Auberge Bouc Bleu in Beblenheim. For a special occasion, don’t miss Aub de l’Ill (€€€) in Illhausern, which is a 2 Michelin Star restaurant. It was in fact a 3 Michelin Star restaurant up until recently but for Olivier it still is very much a 3 Star and worth the visit. 
Burgundy - Christophe Roumier "If you consider Burgundy to be larger than only the Cote de Beaune and Cote de Nuits, then my favourite restaurant is certainly Aux Terrasses in Tournus, which although only one Michelin Star, has a lovely creative cuisine full of energy and based mainly around local produce. The wine list is just perfect, although, like many places, it's full of young vintages. I like this place a lot! Closer to Beaune, one of my favourite restaurants is Hostellerie de Levernois for the high level of its cuisine and its very accomplished wine list. But here the place is a little more fancy." Brunello di Montalcino – Gianlorenzo Neri The most authentic place in Montalcino area is Trattoria Il Pozzo or Il Leccio in Sant'Angelo in Colle (a village in south area of Montalcino). Inside Montalcino village do not miss Il Giglio, Alle Logge di Piazza, and Drogheria Franci. For special fine dining you must try Osticcio. The best wine lists in town are at Il Giglio (you can find very old and rare vintages of Brunello from great wineries) as well as Drogheria Franci (same ownership of Enoteca La Fortezza who have an extensive wine list to choose from). Do not miss "Pinci" with meat sauce or pecorino cheese and pepper (in italian "cacio e pepe"), it is the typical pasta of the area, or "Peposo" which is a braised beef meat cooked in
a Brunello sauce. Santa Barbara – Matt Dees (Jonata & The Hilt) For dinner I would recommend the El Encanto restaurant which has beautiful sweeping views across Santa Barbara city. The food is awesome too. Don’t forget to stop off at the Mercado Ice Cream Parlour too. This place has got to be making some of the best ice cream in California. The Lark is pretty awesome. My personal favourite is Ca’Dario, a sort of no thrills Italian restaurant - the food is really authentic. We also have some of the best Mexican food being made in the US. These restaurants really are some of the jewels of the city. I love El Bagio
but there are loads of great ones to choose from! 
Chablis – Olivier Bailly – Domaine Billaud Simon Too few people make the one hour drive from the Cote d’Or to Chablis; the region is an overlooked culinary hot spot that offers exceptional value compared to the Cote d’Or. Olivier Bailly’s favourite restaurant in Chablis is Au Fil du Zinc for "the precision" of the Japanese Chef. According to Olivier, "he produces very good French cooking with a Japanese influence". Le Syracuse is another restaurant he recommends for the quality-to-price
ratio: "it is excellent!" 
Burgundy - Veronique Drouhin Veronique Drouhin also recommends the Bistrot du Bord de L'Eau in the commune of Livernois (just outside of Beaune). She describes it as “delicious, fairly priced and a lovely location both indoors and outdoors if the weather suits". Another recommendation is the L'Hermitage de Corton, just outside of Beaune, on the way to Aloxe Corton. Again it offers "delicious food at a good price in a beautiful setting... plus
the owners are delightful". If you find yourself in the centre of Beaune, Drouhin recommends Le Carmin, “a one Michelin star restaurant, worthy of the star”. For 'bar and tapas' style evening with friends, her pick is the gastro-bar Maison du Colombier. Another recommendation in Beaune is Le Bistrot des Cocottes: “nice, fun, very good”.

Of all the misconceptions about rum – and there are many – the belief that there aren’t any rules is arguably the most rife. “There is not a lack of regulation in rum,” Mitch Wilson, Global Brand Ambassador for Black Tot, says. “Rum is an umbrella term for an entire category, it does not specify a particular locale like ‘Barbados Rum’, ‘Jamaican Rum', 'Guyanese Rum’ would. Just as there is no 'one rule' for all the different whiskies around the world, there is no one rule for all of the different rums either.” Industry legend Richard Seale picks up the point. “Rules do vary from country to country in rum but that is no different to any spirit. What is different about rum is that it is rarely protected in export markets with a generic rule applying to all origins. “For example, rhum Agricole is a protected term in the EU, but in the US, you can use the term agricole with impunity. Jamaica excise law has protected its rum from adulteration for as long as Scotch whisky [regulations have existed] but you can find Jamaican rum with added sugar for sale in the EU and there is nothing at the moment to stop it.” Herein lies one of rum’s greatest problems and a source of the most heated debates: abuse. “Many rum brands have got away with misleading age claims and egregiously adulterating their products,” Seale explains. “There is little impetus to regulate. I am quite sure if similar happened with whisky, the Scotch Whisky Association would be pressing authorities to act.” Instead, it’s been something of a people’s movement and Seale says consumers are demanding more transparency. “I think huge progress has been made at the level of enthusiasts and industry professionals,” he adds. “Of course, there are many duped consumers but they are typically at a level that they do not care, so we do not care. “We have a mantra: ‘drink what you like, know what you are drinking’. Simply put, make an informed choice.” Daniele Bondi, who works for Hampden Estate's global distributor La Maison & Velier, agrees and says it’s only fair that people are made aware of the content in their glass. He adds: “You can keep adding whatever you like but tell me please. If there is a lot of sugar in what you buy, you should at least know about it like other food categories.” There are countless examples of European entities buying rum in bulk and adding sugar before bottling. They are not lawfully required to declare this and can brandish the words “Jamaican rum” on the label. This, argues many, is deceitful and incredibly harmful. “It’s important to limit this sort of practice and preserve the rum style and not create confusion,” Bondi adds. The Export Director says people will taste a sweetened Jamaican rum and not realise the liquid isn’t true to Jamaican style or that it has been adulterated. The need to disclose these practices extends beyond the consumer’s welfare and is of vital importance to the preservation of rum heritage and production methods. While valiant efforts are being made, the vested interests of some, who wield great power, are thwarting progress. For this reason, the team at Foursquare has created #saveBarbadosRum and are working towards getting the EU to recognise a Geographical Indication (GI) for rum from Barbados and Jamaica. “This would protect our rums from the adulteration that currently happens,” Seale says. “While the US does not recognise GIs, we could communicate to consumers which are the certified rums.” Seale says this is not universally popular. “At the moment, a single foreign interest who bottles adulterated rums sourced from distilleries in which they have a financial interest is taking whatever action they can to effectively derail the process.” The campaign hopes to raise awareness of this and what he calls the “long-term threat to the integrity of our rums”. He continues: “The hubris of some European companies towards rum is astounding. They continue to have an extraordinary sense of entitlement notwithstanding Barbados and Jamaica are sovereign countries.” The ethos at Foursquare and many other distilleries, including Mount Gay in Barbados, is to produce unsweetened, unadulterated rum in the centuries old tradition. Beyond the skulduggery that occurs, rum has struggled with another image issue and this is largely due to classification. Wilson says an insistence on grouping all rums as the same thing, irrespective of who made them – and their local laws, know-how and traditions – perpetuates the myth and undoes a lot of hard work over the past five to 10 years. The only way for this to truly change is through better education. “Without a doubt rum’s greatest struggle is to catch up our education with that of the whisky category,” he says. “On one hand you have hundreds if not thousands of whisky aficionados able to rattle off dozens of distilleries and their corresponding nuances throughout each Scottish region and the rest of the whisky world, with well-established whisky shows and dozens and dozens of books on the subject. Meanwhile, most people still think of rum as ‘white, gold, dark, or spiced’ and have very little understanding of the various regions of rum, raw materials or the differences that lay within.” He says there are undoubtedly a brave few who bang the “rum drum”, but they are “vastly outnumbered”. Another key difference, he says, is the way the rum world is set up compared to the whisky world. There are considerably more whisky distilleries than rum producers, and the majority are owned by behemoths with deep pockets to fund whisky education on various styles and regions. By contrast, many rum distilleries are independent or government controlled. In the instances where big multinationals do own rum distilleries, Wilson says, they typically only own one or two and understandably finance education on their offerings rather than the wider rum world. For the most part, he says this different structure is a positive thing, resulting in a “fiercely independent style” from each region and act as a “great preventative against homogenisation in the industry”. But the cost is felt by others who have struggled to get their message to the masses. “It’s like wine,” Dictador Creative Director Ken Grier explains. “Pinot Noir from the New World tends to be lighter but with a higher abv. Those from Old World producers are often darker and lower strength. It’s the same in rum; you really need to look beyond the headlines on the label. We have to explain the differences between rums from different regions and the distinction between brands. “We need to educate about provenance (cultural influences, stories), production, maturation etc. They will all become key.” One way to educate consumers, in Wilson’s view, is through conversations about blends. “The very essence behind blending rum from different regions is because each distillery’s flavour profile can be so unique and so varied,” he says. “If we choose to tell the customer why we picked the rums we did, and why each region has its own unique flavour profile and is individually important, I think we can give people a great snapshot of the wider rum world, and at the very least give them a starting point as to where to look should they be interested in researching further.” During the pandemic, Black Tot has – via the medium of technology – hosted tastings to do just this. “Rather than just let them taste our finished blend, we also deconstruct the blend into its individual components, allowing people to try rum from Barbados, Guyana, Jamaica individually, and understand what each one brings flavour wise to our blend. I believe this is the future of blends, to not just look at the finished product, but to really celebrate the provenance of where the rum is coming from.” In a similar vein, Venezuela’s Diplomatico has championed alternative production methods with its Distillery Collection. “The concept behind the collection is to produce, in limited quantities, rums from a single distillation method that are subsequently aged for a certain number of years,” Maestro Ronero Nelson Hernandez says. “The objective is to offer the opportunity to connoisseurs and rum lovers to discover the very own character of each one of these rums, in a collection that reflects our distillery’s wealth.” It might sound simple but tasting the liquid and reading the label can be the difference between cutting this misconception off at source or continuing down the sticky road. Bondi says it is sometimes easier for him to speak with single malt drinkers rather than “rum drinkers” who are used to a lighter and sweeter liquid. He often gets them to try the Hampden 8 Year Old – the most approachable rum – and asks what they think, and if they thought rum could taste like this. The reaction is instantaneous and incredibly satisfying for the Export Director when he gets to explain that this style is rum, in the authentic sense. Historically, “global” rums have tended to be lighter and sweeter, and far removed from the authentic liquid that is recognisable to the rum purist. To satisfy the global market, sugar has been added to sweeten the taste and in many cases caramel to darken the colour. “The first conversation is always – no, this is rum and all the other sweeter stuff, what you think is rum, maybe is not. At least from a historical point of view,” Bondi adds. “If you speak with single malt experts, they are normally super happy because there is sort of a resistance among the single malt community because ‘rum is sweet’, so when you approach with something like this [Hampden] they say wow, this is something that I can easily recognise because it is dry, it’s full-bodied, it’s funky, it’s flavourful like all the single malts they like.” Bondi finds adopting his boss, Luca Gargano’s – the man responsible for the classification of the same name – production-driven terminology helpful when introducing people to real rum. In the same way whisky drinkers understand Scotch whisky has regional styles – Speyside, Highlands, Islay etc – rum can be communicated in the same way. “Like a different category within a category,” he adds. Hampden is famous for its funky, high ester style, that Bondi says appeals to the peated whisky fan. “It’s more for the adventurers”, he says. “They love this crazy taste of Lagavulin and Laphroaig and maybe they will love to try rum with a different, funky taste.” Undoubtedly, the conversations and appreciation for rum are maturing. The category is shedding its skin of these unhelpful labels that have besmirched its reputation and the right questions are now being asked. Thankfully, there’s a formidable cohort armed with the answers and willing to speak truth to power in order to protect something that is truly sacred. Explore rum or read more Editorial

Rum: the sticky issues

What defines a fine wine? For many, it is a bottle’s ability to improve with age. A wine’s longevity is even seen, by some, as the ultimate measure of its quality. It’s true that aged wine can be some of the most memorable – capturing an essence of time that’s impossible to recreate. The ageing process can be central to a wine’s (or, for that matter, whisky’s) progression to another, unparalleled level of complexity. Yet how a wine ages remains something of a mystery to both winemakers and collectors. There is still a great deal of conjecture about how a wine will develop, why it does so, and whether it is even worth the wait. Unlike whisky, wine is much less stable on its journey into maturity. As Christian Moueix puts it, “Wine is a complex matrix of thousands of compounds suspended in a delicate equilibrium.” This equilibrium is fragile, age a potential threat and a wine’s trajectory therefore incredibly difficult to predict. There was a time when wine drinkers dismissed the New World. Today, fortunately, that’s not the case – and it’s rightfully acknowledged for producing fine wine. However, some snobbery remains. Drinkers tend – beyond a handful of the very top names – to drink New World wines much younger than their Old World counterparts. Ask any oenophile about the oldest bottle they’ve drunk, and we’d put money on it being from Europe – Bordeaux, Burgundy, the Mosel, Alsace or Douro. Of course, one element is undoubtedly availability. The traditions of drinking Bordeaux (even from modest châteaux), for example, at full maturity – 20 or 30 years down the line – is not uncommon, and these wines continue to be regularly traded among collectors. New World wines at full maturity are much more of a rarity. Many of the younger regions in the New World still haven’t had the chance to build up such an extensive back catalogue, yet the wines have everything they need to comfortably age as long as their counterparts. Burgundy maestro Jean-Marie Fourrier, who now also manages Mornington Peninsula winery Bass Phillip in Australia, is an advocate for New World wines’ ageability, with Bass Phillip’s Pinot Noirs a case in point. But he believes the reputation for a shorter drinking window is partly due to practical, economic necessity. “When you start making wine at a young winery, you need a quick turn over, a quick return on investment,” he says. Therefore, producers craft wines that can be drunk younger. It is only once a winery, or a region, is established that winemakers can afford to have a longer-term approach and deliberately make wines to age or hold back stock. In this respect, the established classical regions of Europe have hundreds of years of history to fall back on. Napa has long since proved its mettle producing wines that can age. But just what it is that allows a wine to improve with age has been a hot topic of conversation in the region for decades. Tor Kenward – of Tor Wines – recollects a conversation between himself, Robert Mondavi and another legendary Napa winemaker, André Tchelistcheff over 40 years ago. Sitting around a table, they were trying to determine the key factor that makes great wine age. Was it the winemaking? The quality or concentration of the grapes? Or was it all about harvesting at the right time? Tchelistcheff – who trained in Europe and, by this time, had been making wine in Napa for over four decades – contemplated the suggestions. High acid levels (low pH), high concentration of tannins and oxygen management were all tabled and, while he accepted all were important, for him, a great wine for ageing needed “flesh”. By this, recalls Kenward, he meant the grapes needed a certain type of ripeness – not over, not under, but perfect physiological ripeness. Forty years on and Kenward still believes Tchelistcheff was right, yet it is an aspect often forgotten in the discussion of a wine’s ability to age. Finding this perfect window of physiological ripeness can be a challenge in warmer regions, and a warming climate, and therefore remains an obstacle for much of the New World. These regions tend to be warmer than historically marginal wine-growing regions of Europe, and therefore grapes can ripen quickly, but with this fast ripening comes a risk of reaching sugar ripeness before the skins have had the necessary time to reach maturity. Christian Moueix is one of the world’s most experienced winemakers, having managed both Pétrus, Trotanoy and other top Pomerol estates, as well as Napa’s Dominus. He agrees with Tchelistcheff that picking the grapes at optimum ripeness is a hugely important factor when producing wines that can age. “If harvested too early, grapes have a smaller quantity of extractible phenolic compounds and […] may not have formed the longer chains and bonds that make them stable.” On the other hand, when overripe, “These phenolic compounds are degraded through oxidation.” For Moueix, the temperate climates in Europe are ideal for “developing and maintaining a high ratio of phenolic compounds”, whereas in many New World regions, there is a propensity for excessive heat, over-ripeness and therefore oxidative winemaking which he feels is, “likely to contribute to wines that age prematurely”. In warmer climates, Moueix believes, “extreme heat, enzymatic and physiochemical reactions degrade anthocyanins within the berry, lowering the concentration of total phenolic compounds and subsequently, the wine’s capacity to resist oxidation, leading to premature aging”. For Moueix, then, a temperate climate (whether in the New or Old World) is key to producing wines that can age. It is, he believes, the reason why Dominus ages so well. This corner of the southern Napa Valley is relatively mild, thanks to the San Pablo Bay’s cooling influence. This slows sugar accumulation and gives the berries time for the tannins to ripen. They also don’t use irrigation, putting the vines under more stress, producing small berries with high phenolic concentration. Like Moueix and Tchelistcheff, Fourrier believes picking dates and high concentration of tannins is important – but he ties this to vine age, rather than the microclimate. “As vines get older, the size of the berries gets smaller,” explains Fourrier. It is this that gives a high skin-to-juice ratio and natural concentration. For Fourrier, this natural concentration is what gives ageing potential – rather than any actions in the winery. All are in agreement that the ageing ability of red wines comes down to the quality of the berries, rich in anthocyanins (ideally then from older vines) and picked at the right time in order to extract them at their optimal level of ripeness. But these factors affect Old World producers as much as those in the New World. Paul Roberts – Master Sommelier and COO of Colgin in Napa – makes a compelling point that New World regions in the right climate regularly produce higher concentrations of tannins than the Old World’s cooler climates. In fact, they have to pay close attention to extract less tannin during the winemaking, not more, to maintain the balance in the wine for it to age. Colgin’s mountainside IX Estate vineyard on Pritchard Hill produces berries that are, on average, 30% smaller than those grown in Pauillac. Often, Roberts notes, Napa Cabernets have higher skin-to-juice ratios than the Bordeaux First Growths – and therefore much more “anti-oxidant” tannins than their Bordeaux counterparts. According to Moueix’s belief that it is the concentration of tannins and phenolics found in the skins that protects wine from oxidation and degradation, this should mean that top Napa wines have the potential to outlive Bordeaux wines at the top level. Andy Smith, winemaker at the Russian River’s DuMOL estate, makes some of the region’s top Pinot Noir and, like Colgin, has no shortage of tannins in his grapes. Compared to Burgundy, his Pinot Noir has smaller berries, “with uncommonly thick skins that create huge natural power if you choose to extract fully”. For Smith, “this leads to a potential for powerful, deep wines with high structure for aging, and high natural acidity”. Like Colgin, it is an overabundance of tannins that is more of a concern at DuMOL. “The key is balancing the extraction,” says Smith, “to take the positive and leave behind the excessive elements from the skins.” For leading Chilean winemaker Francisco Baettig (Errazuriz, Seña and Chadwick) it is an excess of tannin, and an excess of extraction in some more ambitious wines, in the New World that has tainted its reputation for producing wines with long ageing ability. “There was an obsession for creating monster wines, with lots of extraction, trying to extract as much tannin as possible,” Baettig notes, looking back 10-15 years. Many producers in Bordeaux were doing the same at the time, but the different climates – the same elements highlighted by Roberts and Moueix for leading to higher concentrations of tannin – influence the tannin and extraction. “In Chile with higher intensity and higher levels of ripeness, the extraction happens much quicker,” he explains. This resulted in over-extraction – “wines that were rough, too tannic and did not age well”. For New World producers, better tannin management is clearly key to producing wines that can age. Producers like Tor, Colgin, DuMOL and Baettig all believe gentle extraction of tannin and reducing the wines’ contact with oxygen is fundamental for ageing. In cooler, less sunny European climates, it could be argued that in the past, due to the less easily extracted tannins, producers could get a way with being a lot less precise in their tannin management. With this in mind, Baettig notes the Old World might need to learn from the New World, how best to adapt their winemaking to the effects of climate change – and, in many ways, they already are. Vignerons are already looking back at sunny vintages such as 2005 and 2010 (with high levels of extractable tannins) and questioned some producers’ apparent over-extraction of tannins, adapting accordingly in years like 2019 and ’20. The transformation of grapes into wine is magical; the secondary transformation that can take place with maturity is possibly even more extraordinary. However, a wine with so much promise can disappoint if left too long – a frail, bitter example of its former self. It is no surprise that many drinkers choose to avoid such risks and savour wines in their more muscular youth. There is a cultural change too. DuMOL’s Smith notes that the average US consumer is not particularly interested in ageing their Pinot Noir and questions whether ageing wine is an outdated notion. In a society that favours immediate gratification, modern consumers are impatient and few have cellars in their homes. And the savoury flavours that come with maturity aren’t to everyone’s tastes. “There’s a big difference between positive evolution, plateau-ing and the gradual downward slope of oxidation,” he says. “All wine ultimately wants to become vinegar!” Because of this, some winemakers are deliberately pulling back from making wines that peak at 20 years, instead looking to produce wines that will appeal in youth and peak closer to 10 years, since that’s what their customers want. Even the most tannic red wines from the more traditional regions are these days much more approachable in their youth, something that just wasn’t possible just a few years ago (as noted by Lisa Perrotti-Brown MW). Making fine wine is an art – and especially so when it comes to building a wine for the future. Choosing the perfect moment to pick in the given climate, as well as the right style and level of extraction in the winery will determine a wine’s ageability – but only if the underlying quality of fruit is sufficiently high.
