We arranged a tasting of some of the top picks including Jean Stodden, Klaus Peter Keller, Bernhard Huber and Dr. Heger. The variety on offer just from a handful of these wines showed the incredible potential of the region for top Pinot production. With Pinot’s inherent ability to express terroir we found a huge range in structure and flavor profiles from different single vineyard sites. 

Prior to our mixed case offer of these top producers out next week, the tasting helped us map out the different terroirs in Germany as well as the typical profiles of these top producers. With such rich diversity in soils, climate and clones throughout the Pinot growing regions of Germany, there is plenty to discover, from the cooler climate, slate soils of Ahr to the richer, more opulent Pinots of Baden.  Pinot Noir’s amazing ability to express terroir is the perfect vehicle for the variety and nuance to be had from the top sites in Germany, which are dotted all around the fine wine regions of Germany including Mosel, Ahr, Franken, Rheingau, Rheinhessen, Baden and beyond. In the last 20 years there has been a quality revolution in Germany, specifically with Pinot Noir production, buoyed by the ever-increasing demand for Burgundy and the intrinsic connections the Germans have with their contemporaries in Burgundy.  Many producers have strong links with the Cote d’Or either having worked extensively in the region or from forging long-term friendships with some of the top growers. Between the two regions, there has been a real sharing of knowledge from viticultural to winemaking techniques, exploring the variations and nuance created by the distinct soils and the mix of both German and Burgundian clones being used today in Germany.   The recent trends in Pinot Noir production with a move towards earlier picking, less extraction and a reduction in oak have helped further promote the diversity of styles found throughout the German Pinot regions and allowed the top producers to really shine in recent years. Critics throughout the world have been praising the results coming out from the top producers in Germany. This Pinot Noir Revolution gripping Germany is well worth getting excited about and we are thrilled to be able to offer a range of some of the finest examples.

 Top Pinot Noir producers Jean Stodden – Ahr 
One of the longest-running wineries in Germany, the Jean Stodden estate has been producing wine in Ahr since 1578. The wines are unique thanks to their very specific terroir and incredibly cool climate and this shows in spades throughout their range of wines, producing beguiling ethereal examples that are quite unlike Burgundy but distinctly European. 

This really is cool-climate Pinot, with vineyards located 50km north of Mosel. The wines
only reach ripeness thanks to the steep south-facing slopes grown on slate soils that retain the heat in the vineyard. The Estate has just 6.5 hectares of vineyards. This soil type, steepness and slate soil offer a completely different style of Pinot Noir compared to the Cote d’Or.

On tasting, the wines have an incredible line of acidity running through them, distinctly more marked than Burgundy. There is amazing contrast here too. Tasting the Sonnenburg Grand Cru alongside the Monchberg, these wines have completely different personalities, the Sonnenburg is incredibly linear and focused on the palate with great precision and pitch. The fruit is delicate and uber-fresh – sappy cranberry, wild strawberry and earthy rhubarb flavours. This is one for all the acid heads.

The Monchberg really is outstanding, and certainly worthy of Grand Cru status anywhere in the world. Incredibly compact with tons going on. The spectrum of fruit goes from fresh red fruit right through to meatier, savoury tones. The mid-palate is striking – weighty and viscous yet still has such delicacy and finesse. The length and breadth of the wine is extraordinary and the contrast of the wine shows real terroir in action. This wine is not cheap but its is stunning. 

Both wines have quite a different tone to Burgundy but are full of European etherealism. If you can find it, the Monchberg is one not to miss. World-Class.

 Markus Molitor, Mosel
 Starting from practically nothing in the early 1980s, Markus Molitor has rapidly grown into one of the world's most respected winemakers, with a list of accolades including Rising Star of the Year 1999 from Gault & Millau, Winemaker of the Year 2014 from Falstaff and raft of huge critic scores. He is also the proud owner of over sixty hectares of prime real estate that Mosel Fine Wines – an independent review of Mosel Riesling – describes as a "who's who of Grand Cru between Erden to Bernkastel and the Southern Saar."

Molitor, like all producers in the Mosel, is most well known for his Rieslings, with Pinot Noir just making up 4% of his plantings. However, his top Pinot Noirs are becoming as collectible and as respected as his whites and are rated amongst the finest in the world. He produces seven different Pinot Noir cuvees in total.

 Alongside Egon Muller, Klaus-Peter Keller’s wines are the world's most collected and prized wines coming from Germany, famously quoted by Jancis Robinson his Riesling has been described as the Montrachet of Germany. Whilst his Rieslings initially brought so much international fame to the winery, his Pinot Noirs today also have a strong following. His 16 hectares of vines are predominantly made up of Riesling plantings but he has a Grand Cru site for his Dalsheim Spatburgunder grown on the Burgel Grosses Gewachs site. 

This Grand Cru has a specific shell limestone soil more suitable for Pinot Noir than Riesling
production. Yields are minuscule with each vine reduced to just two bunches of grapes and each individual cluster further halved. Klaus believes this helps to increase the overall acidity allowing him to pick the grapes at full ripeness whilst retaining freshness. His global recognition in a region more famous for high yielding dirt cheap Liebfraumilch, has caused a quality revolution in Rheinhessen, with more producers following in his footsteps. 

The Keller Pinots are genuinely impressive, the wines capture the beguiling Pinot fragrance
and the finesse to the tannins are very close in style to top Burgundy. We tasted the Frauenberg Grand Cru, the last of Keller’s Pinot Noir vineyards to be harvested, being the coolest site and grown at altitude. The wine has tremendous stony minerality, very precise fruit clarity and is not without structure – think Clos de la Roche rather than Chambertin.

Frauenberg Spatburgunder GG 2013: “From French mass selections planted in 1996 and picked with 35 hectoliters per hectare, the 2013 Frauenberg Spätburgunder trocken GG has a
clear and subtle yet aromatic bouquet of red and dark berries (raspberries, wild blackberries, cassis), along with some flinty/smoky flavors. Intense, concentrated and firm on the palate, this is a full-bodied, powerful and firmly structured Pinot.  It has a velvet texture, ripe and grippy tannins, and a persistently sweet and concentrated flavor of ripe cherries and red fruit jelly in the finish. The wine has more power and body than the Bürge, l but also needs more time to develop. It's from a cooler and windier plot, and always the last Pinot harvested at Keller. The 2013 was aged in used barrels, whereas only the 2012 was still in new barrels until the malolactic fermentation was finished.  92 points, Stephan Reinhardt, Wine Advocate “The 2014 Frauenberg Spätburgunder GG offers a ripe, yet precise, fresh, well-focused and rather coolish Pinot aroma; it shows some very discreet toast and mocha flavors highlighting the wild blackberry and dark cherry aromas. Full-bodied, ripe and concentrated on the palate, this is an intense and juicy, almost charming Pinot Noir from low-yielding vines on limestone
bedrock (21 hectoliters per hectare). The finish is intense and powerful, but well structured due to the stems on which the wine fermented for 21 days.  The finish is almost sweet, due to the ripeness (a word rarely used 30 years ago in the higher altitudes of the Frauenberg), but is also very fresh and precise; whereas the ripe tannins give the required grip and structure. This is a promising wine with delicate fruit flavors, mineral freshness and probably more power than the Bürgel; but at least at this moment, it maybe has less transparency and finesse.

 Bernhard Huber, Baden
 Bernhard Huber was seen as the German godfather of Pinot Noir and was one of the most
instrumental vignerons to improve the region's reputation for the varietal. Working extensively with massal selection of clones, 10 – 15 different Pinot clones exist within one vineyard. Huber’s style has always been centred around creating a “nervosity” in his wines. The vineyards share a similar climate and limestone soils of the Cote d’Or. 

The wines are distinctly smoky, meaty with both sweet cherry liqueur notes but also greenness too. The Sommerhalde Grand Cru however is a real step up from the Alte Reben cuvee (made from declassified Grand Cru grapes). Even more impressive was the Bienenberg Grosse Gewachs. You certainly get more weight in these wines from Baden. The wines have rich broad textures on the palate and the tannins more velvety and sturdy than the wines of Keller and Stodden with have more finesse.

What the critics say
 "Cherry red and fresh in color, the 2015 Sommerhalde Spätburgunder GG has a pure, very elegant and rather floral bouquet of fresh red fruits. Still a bit reductive on the palate, this is an elegant, silky textured, fresh and fruity Pinot Noir with firm but fine tannins and a long, complex and pretty tight finish with reduced power. It is an impressive wine but the most closed of Huber's 2015 GG Pinot quartet at this early moment. Tasted in Wiesbaden,

Bernhard Huber Malterdinger Bienenberg Spatburgundr “R” 2015 – “Julian Huber's 2015 Bienenberg Spätburgunder GG shows a lovely, vital ruby red color and opens a bit reductive still, with a clear, fresh and well-defined bouquet of red fruits, crushed stones and spicy and floral aromas. It is a full-bodied, firm, fresh and finessed Pinot Noir with a serious tannin
structure and persistent vitality. This is a terribly clear and precise Pinot, and the finish is really cleansing and stimulating. Tasted at the "VDP Grosses Gewächs" presentation in Wiesbaden, August 2017.”

One of the more established domaines in Baden the winery has been in operation since 1935.
Today run by Joachim Heger who was understudy to Helmut Donnhoff, the winery has never been in better shape, producing their unique expression of German Pinot Noir thanks to the distinct volcanic soil found in their two main Grand Cru sites of Winklerberg and Achkarrer Schlossberg.  
The 2015s we tasted were stunning. Whilst perhaps less complex in terms of fragrance at
least at this point, the palate has very fine textured tannins, tremendous finesse - there is so much elegance to these wines and so much freshness, the wines leave your mouth enlivened and salivating. Is this the effect of the volcanic soils? Whilst clearly European in style this is again very different to Pinot Noir from Burgundy but certainly as interesting and ethereal.

 These days this prolific estate is run by Paul Furst who has continued to make further improvements in their already world-renowned vineyards, further increasing the planting density and replacing German clone vines with Burgundian clones. The estate comprises 20 hectares in total, of which 13 are planted on the Centrafenberg Vineyard in Burgstadter, one of the most celebrated vineyards in Germany. The site is made up of red sandstone, iron rich soils ideal for Pinot Noir production. He also produces a Pinot Noir on the very steep slopes of Schlossberg. Furst is famous for their tiny yields operating at ruthlessly low production levels in order to maximise quality.

The palate is lush and firm but also concentrated and very elegant, with remarkable finesse and aging potential. This is great German Spätburgunder, and I am looking forward to tasting it again with more time and more wine in my glass. Temporary score.

One name that kept cropping up when speaking to winemakers about wine and cheese pairing was Bernard Antony, a man who now supplies 20 of the world’s 3* Michelin chefs as well as working alongside many of the world’s top winemakers matching cheese and wine at events for Guigal, Angelus, Humbrecht and many more.   We caught up with Jean Francois Antony (Bernard's son and protege) to find out more about Affinage (the ageing of cheese) and their perfect cheese and wine pairings. 45 years at the service of taste Bernard Antony is one of the world’s great cheese makers. Strictly speaking, his mastery
is in affinage, that is finishing and ageing cheeses. From humble beginnings working as a travelling grocer in Alsace, in 45 years he has gone on to become one of the most recognised men in the world of fine cheese.  Bernard Antony was the protegé of the late great Maitre Pierre Androucet – known as “the Pope of Cheese”. Bernard says of Pierre: "To me, he was like a father. He was the man who created me, who taught us everything, to my wife and me. He didn't like me to say it because he wanted to give me all the credit for my success”.  Following on from Androucet’s advice and support, Bernard set up his own cheese ageing cellars in the early eighties in the southern Alsace village of Vieux-Ferrette. The ageing cellars are made up of seven different chambers all at different humidity and temperature levels – ideal for raising and ageing various different styles of cheese. Only when the cheeses are deemed ready and at perfect ripening are they released to the markets and delivered to restaurants. Ageing of cheeses can range from just a few months for the fresher goat’s cheeses to several years for some hard cheeses. Speaking with Jean Francois Antony, Bernard’s son, who works alongside his father, running the day-to-day operations of the cellars, he identifies that the skills in good affinage revolve around a number of key elements. First of all, “raw (unpasteurized milk) is essential if one is to speak of cheese with authenticity…taking into account the breed of animal, the animal's diet, the talent of the cheesemaker and then of course the controlled process of ripening are also key”. The cheeses arrive at the cellars already halfway through ripening and their ageing cellars go into action to give them the final touch. They provide the perfect environment and temperature for ageing as well as the most important element in the Bernard Antony cheese cellars, the natural yeasts that live there helping the cheese mature distinctly and in the best way possible. The famous ageing cellars are open for visits in the village of Vieux-Ferrette. If you are travelling through Alsace it is an essential visit. Book via their
website. They often pair the cheeses with fine wine so we thought who better to ask for advice on the ultimate cheese and wine pairings than the man himself.  Below is the Bernard and Jean Francois Antony’s essential guide to food and wine matching, split up between the different styles of cheese, with additional advice passed down from Pierre Androucet.  The Floury crust family of cheeses Camembert        Brie de Meux (un peu sale)         St Marcellin and St Marcellin (runny)     Petit Mosellan         Coulommiers         Chaource
 The classic pairing would be Champagne (Blanc de Blancs, Aged and even Rose Champagne) however Bernard Antony advises that you remove the crust as it can make the wine appear more harsh. The bubbles work brilliantly in refreshing the palate from these rich cheeses and the yeast flavours from the Champagne also work really well. Avoid tannic reds with these cheeses. One of Bernard's favourite matches include a Gevrey Chambertin 2012 from Domaine Denis Mortet with the St Marcellin. He states a white wine with both gentle oxidation and good acidity works particularly well with Petit Mosella (Saint Peray from
Domaine Tunnel or Alain Voge) or a fruity red wine with well-coated tannins such as a Beaujolais Cru wines with the Chaource and Colombier fermier. The Washed Crust family of cheeses Epoisses       Langres         Livarot     Munster  Maroilles    Vacherin         Pont-l’Eveque According to Androuet: robust and virile wines, with sap and generous bouquet work best with these potent washed crust cheeses. They require “solar wines“ which can harness the power of washed crusts. Gewurtztraminer Grand Cru from Albert Mann, Chambolle Musigny from Liger Belair would both work well. Pinot Noir from Zind Humbrecht, Bollinger 2008 Grande Annee also a particular favourites with Bernard Antony. The pressed crust family of cheeses Comte     Emmenthal        Beaufort         Gruyere Suisse According to Androuet the matches depend on the evolution of the cheese. Dry white or red wines with bouquet work well, red wine brings a balancing touch of bitterness. These cheeses flatter any red wine by erasing astringency and promoting fruit therefore making White or Red Burgundy a good match. With more ageing of the cheese, wines from the greater South-West, the Rhône Valley and Languedoc Roussillon become better matches. Other personal
favourites from Bernard Antony include Vernaccia di San Gimignano (Italy) White
wines from Valais (Switzerland), and Savignin wines from the Jura. The pressed (uncooked) crust family of cheeses Morbier   Tomme de Savoie fermiere       Mimolette demi étuvé         Salers     Roblochon  Sainte Nectaire Pairing again depends on the maturity of the cheese. The older the cheese the richer the wine. Chateau Latour 2001 is Bernard’s match with Morbier. Saint Joseph Pierre Gonon 2013 works well with Reblochon and Chateau Canon La Gaffeliere Grand Cru Classe St Emilion 2008 works well with Saint Nectaire. The family of blue cheeses Bleu d’Auvergne     Roquefort        Fourme d’Ambert      Blue de Gex          Stilton    Gorgonzola These are best paired with sweeter fruited wine or sweet wines. Avoid red wines as the mould changes the structure, the aromas and brings out the bitterness. Top picks are Rivesaltes Vins Doux Naturels, Pacharenc du Vic Bilh or aged Sauternes even red Vins Doux Naturels such as Maury, Banyuls work well with blue cheeses. The family of Goat and sheep cheeses Ossau-iraty         Brebis cremeux et parfume Brebis Corse     Chevre Frais    Chevre Moelleux et onctueux   Chevre Affiné. Vieux et sec   St Maure de Touraine Banon de Provence Chevrotin des Aravis With this family of cheeses the wine must tame the acidity of milk. The wine must work with the texture of the fat and complexity of the flavours. Androuet confirms the well-known phrase – match local wines with cheese of the same origin, particularly very dry and fruity whites. Dry white wines from the Loire – include the smoky Pouilly Fume, Sancerre, Menetou-Salon, Quincy and Reuilly work well with the goats cheeses from the region. From Burgundy, try the lighter Aligoté, Saint-Véran, Macon villages and from the Alpine pastures the white wines of Savoie or lighter reds of the Loire – Bourgueil and Chinon. Bernard Antony’s particular favourites with these cheeses include wines closer to home including Riesling Vendange Tardive 2007 from Barmes Buecher, 2002 Brundlmayer Gruner Veltliner Kaferberg 2002 and Pinot Gris Grand Cru Osterberg 2016, Domaine Agape. It was about this time last year we bumped into Giovanni Angeli, winemaker of one of Barolo’s top producers, Massolino. He was over in London to promote his latest 2015 releases. Despite the positivity surrounding the 2015s, Giovanni just couldn’t contain his excitement about the vintage that was to follow. At this time, the wines were still over a year away from being made available. Ever since we have been waiting eagerly for the first Barolo 2016s to be released and to taste for the first time this hugely anticipated vintage. Fortunately, that time is finally upon us, with the first handful of releases being made available over the next few weeks. I caught up again with Giovanni last week to find out exactly why the 2016 is so special and his thoughts on the wines now that they are in bottle. Ideal ambient conditions through the growing season The key points behind the success of the 2016s lie in the ambient weather conditions throughout the season, particularly favourable for the Nebbiolo varietal, which has always been a rather sensitive grape – hence why you see so little of it grown anywhere else in the world. Great Nebbiolo requires a long extended growing season to enable its structural
tannins to really reach phenolic maturity and mellow out.  Secondly, the varietal is distinct for its ethereal aromatic perfume and this only really
develops in the later part of the ripening period. Thirdly, the varietal is very susceptible to mildew and can really suffer if the weather is too humid, but thankfully the ideal weather conditions held right through to harvest. 2016: Longest growing season in modern times 2016 was one of the longest-growing seasons in modern times. Giovanni explains that the
winter between 2015 and 2016 was in fact fairly short and relatively warm (the second warmest in 59 years in Piedmont after the winter of 2006 and 2007). He goes on to explain that this warm winter generates an early recovery of vegetation growth, resulting in early budding.  The spring was then pretty regular – no frost but not too hot either - allowing the wines to operate regularly in perfect health. The summer remained very regular, again not too
hot and not too dry, making the vegetative cycle long and slow enabling a build-up of complex flavours. Giovanni states that the growing cycle in 2016 was at least 15 – 20 days longer than today’s average in Barolo, thanks to the early start and relatively late harvest. What is extraordinary is that this long vegetative cycle is something that is typically diminishing with climate change. As outlined in Burgundy in an interview last week with Benoit Stehly of Domaine Georges Lignier, the traditional notion that vignerons pick 100 days after flowering is today outdated, with the veraison period under a hotter climate getting shorter and shorter. Giovanni states the same is happening in Barolo, but in 2016, there really were 100 days plus between flowering and harvest.  In September, the month that really dictates the final quality of the vintage, the weather remained warm and steady but with big drops in temperature during the night helping the grapes retain their acidity as the fruits gained great complexity in flavor and outstanding phenolic ripeness. It was this moment in September that Giovanni believes had the greatest impact on the wine's final complexity. “In that moment we have the synthesis of the flavours and the refining of the tannins.”   The finished wines Giovanni describes the wines as deep, powerful and rich, with a great bouquet with lots
of fruit aromas. The quality of the tannins are really outstanding; fine, elegant and very complex and there is good acidity too, making the wines even more drinkable and enjoyable. Giovanni goes on to compare the vintage in terms of quality and style to the great 1996 vintage. Asked to compare with the 2015s, he states “2015 is a really good vintage for us with wines rich in aromas and with a great freshness, especially if you consider how warm the vintage was. But in 2016 the wines have something more. They are more concentrated with a great acidity. They have a juicy, crunchy fruit that makes the wine easy to drink, enjoyable with a great freshness and length in the mouth and a lovely quality of the tannins in terms of finesse.” The drinking window In a vintage where you find such phenolic ripeness, the wines are very approachable, and can be enjoyed at a younger age than is normally typical of Barolo. At the same time, the concentration, the good acidity and the finesse of the tannins mean that although you can drink and enjoy them now, the wines will see a fantastic evolution over 25-35 years and probably longer. 2001 Chambolle-Musigny, Premier Cru, Les Amoureuses, Domaine Jacques-Frédéric Mugnier (and lashings of Beaujolais) – chosen by Daniel Johnnes, Wine Director of The Dinex Group and Founder of La Paulée, La Fête du Champagne, La Tablée and Pressoir  “This holiday I plan on opening several bottles of great wine. Great doesn't necessarily mean expensive or rare. I'll be sure to drink plenty of Beaujolais and mostly from my favorite producers, Morgon from Marcel Lapierre, Fleurie from Jean-Louis Dutraive and Chiroubles from Domaine Thillardon. As much as they are "drink everyday" wines, they also have the magic power of putting a smile on everyone's face.  “Yet, for that really special wine, I plan on opening a bottle of Chambolle-Musigny Premier Cru Les Amoureuses 2001 from Domaine Jacques-Frédéric Mugnier. Chambolle-Musigny is among my favorite villages in Burgundy and the Amoureuses vineyard could easily make a case to be classified as Grand Cru. It combines the perfume, texture, elegance and persistence typical of the very best red Burgundy. The style of Domaine Mugnier is one of refinement and grace. And with 20-plus years’ age, it should be perfect for drinking now. Even though it will accompany a roast chicken, this wine is like a celebration and a meal in and of itself.”  2018 Klein Constantia Vin de Constance – chosen by Jeffrey Koren, Head of Wine at Marceline, London  “While it’s easy to open a perfunctory bottle of Port or Sauternes at the end of a Christmas meal, the oh-so-delicious Vin de Constance by Klein Constantia has become my go-to sweet wine for the festive period over the past few years. Steeped in history, Vin de Constance was famously a favourite of Napoleon and lauded by authors like Jane Austen and Baudelaire. These days, winemaker Matt Day has revived this legendary dessert wine to its former acclaim. It always offers wonderful notes of apricot, honey and spice. But most importantly, it’s balanced by refreshing acidity that is an absolute necessity after an indulgent holiday meal.”  Hauller Frères Pinot Gris La Chappelle Signature – chosen by Joséphine Duffau-Lagarrosse, Ch. Beauséjour   “Ludovic Hauller is a long-standing friend I met during my studies in Burgundy. I appreciate the precision that his family channels into the wines, and this cuvée showcases great finesse, with freshness and elegance, mirroring the granite terroir in which the vines grow. It’s a Pinot Gris of remarkable complexity, hailing from a plot that sits below the Chapelle Saint-Sébastien de Dambach-la-Ville. Ludovic introduced me to Alsatian wines, which I knew little of previously, and I love this cuvée. As for when, this is definitely the kind of bottle I would open in the days following Christmas, with my family, playing board games by the fire and putting the world to rights, patiently waiting for the New Year!”  2002 Champagne Salon, Giuseppe Mascarello’s 2017 Barolo Villero, Tiberio’s 2018 Colle Vota – chosen by Lorenza Sebasti, Castello di Ama  “As usual, this Christmas we will open a magnum of 2002 Champagne Salon. I remember we had the chance to buy a few magnums a long time ago as they were precisely the birth years of our children (1997, 1999 and 2002). Then I guess I will spoil everyone at home with a beautiful Barolo Giuseppe Mascarello Villero 2017 and Colle Vota Montepulciano d’Abruzzo 2018 from my dear friend Cristiana Tiberio. She makes very few bottles of this very elegant and vibrant wine, which is among my favourite reds.”  2021 La Morandina Moscato d’Asti – chosen by Donald Edwards, Head Sommelier at La Trompette, London  “Beyond the best white Burgundy I can lay my grubby mits on, I’ll be cracking the second bottle on a case of La Morandina’s 2021 Moscato d’Asti – part of a new festive tradition. Back when my wine appreciation was still protean, I heard a rumour that Moscato d’Asti – the sweet fizzy floral stuff that we sold in my Glasgow Oddbins – ages magnificently. Twenty or so years later, I’m the Head Sommelier at La Trompette, hosting a big Piedmont-themed wine lunch. Barolos and Barbarescos aplenty litter the room, but the wine that stops me in my tracks? A 2013 Moscato d’Asti from Giuseppe Vajra. It was phenomenal, still gleefully tasty, but now with a touch of extra weight, more waxy lime skin and late-evening summer flowers, heady in its bouquet. Here she was, my white whale, and, boy, she didn’t disappoint.  “Last December, visiting La Morandina in Asti, I asked whether they had anything with a bit of age and lo! a 15-year-old magnum appeared. My stars had aligned for a second time – the wine equally lovely, offering a bit more exotic spice, cardamom and coriander seed along with the sweet creamy lime zest. Crucially, this time I could see the germ of a plan. Each year, I would buy a cast of Moscato d’Asti, building a reserve of Moscato to steadily enjoy over the coming years. I’ll be the Christmas king of deliciously sweet floral fizz. So, on the morning of 25th, I’ll be twisting the top off the second bottle from last year’s case and smugly enjoying my Moscato and crumpet as I let my mind wander over the riches I’m preparing for the coming years.”  François Cotat Sancerre Le Mont Damné and Massican Gemina – chosen by Alex Sarovich, Founder and CEO of Own Rooted Hospitality  "As the oldest of five in a large Italian family, I've learned that selecting the perfect wine is an art form that requires careful consideration of both the food and the audience. When I'm hanging out with my twin 24-year-old brothers, they're all about vibrant, crisp wines like Champagne or Sancerre. This beautiful white blend, composed of Greco, Falanghina, and Fiano grapes from top California vineyards, perfectly captures the essence of our family's wine appreciation – a nod to our Italian heritage with a California twist.”  Coche-Dury Meursault, Domaine de Trévallon and Jean-Michel Gérin Côte-Rôtie La Landonne – chosen by Philippe Abadie of Alvina Pernot  “First of all, we decided to open a bottle of 2022 Meursault from Domaine Coche-Dury, given to us by a client to celebrate the birth of our son Pâris, who was born on January 1st 2022. We also really like the new style introduced by Raphaël since he took over this magnificent estate. Then Trévallon: my grandfather Georges from the south of France was an unconditional fan of the estate, and during my childhood there was always a bottle on festive tables (for birthdays, Christmas, New Year, etc) – so this will be a little wink to him. Then last, a bottle of Côte-Rôtie La Landonne by Jean-Michel Gérin. The story goes back to a few weeks after I first met Alvina, for this is the bottle of red we drank on our first restaurant date.”  2022 Domaine Yui A Rouge – chosen by Carlito Chiu, Wine Director at Andō, Hong Kong  “Established in 2019 by the dynamic husband-and-wife duo Tetsuya and Aya Sugiyama, Domaine Yui is a Japanese winery with a profound mission of unity and togetherness. Inspired by the meaning of the Japanese word “yui”, “to connect/link”, the Sugiyamas are dedicated to bringing people together through their shared love for wine and agriculture. Their A Rouge is a remarkable expression of Burgundy-style red wine crafted in Hokkaido, Japan – a specific blend of Pinot Noir, Chardonnay and Pinot Gris that showcases the region’s terroir. It is particularly special to me because it embodies the innovative spirit of Japanese winemaking, while honouring traditional techniques. 2022 Vosne-Romanée, Premier Cru, Les Beaumonts, Domaine Hudelot-Noëllat This Premier Cru was an absolute standout of our tasting at Domaine Hudelot-Noëllat this year. The pretty nose combines star anise spice, floral lift and crushed rock. Powerfully mineral with such a suave, elegant palate, there is amazing delicacy to the almost smoky, savoury tannin structure, framing the pure, bright fruit. Pinpoint and precise, yet with a mouth-watering lushness, this is a very special wine in 2022. 2022 Vosne-Romanée, Premier Cru, Les Suchots, Nicole Lamarche Nicole Lamarche has 0.22 hectares at the southern end of this Premier Cru, close to Romanée Saint-Vivant, with vines that average 45 to 50 years in age. It is, as Nicole herself described it, “100% seduction”. The nose is sensuous, with sweet, plump berries, baking spice and iris florals, luring you in. On the palate, the delicacy and finesse is astounding. The bright acidity drives the wine, giving tension, yet there’s a luxurious nature the fruit that rolls around the mouth, a touch more generous than her other Vosne Premier Cru Les Chaumes. The tannins are rich, almost savoury, with a pure-rock character. Remarkable. 2022 Gevrey-Chambertin, Premier Cru, Lavaut Saint-Jacques, Domaine Duroché Duroché has 1.2 hectares of this cool, higher-altitude Premier Cru, with vines planted between 1923 and 1980, which is always the last to be picked. The 2022 is an absolute highlight of our tasting at this domaine, the cool site thriving in the warmth of the vintage. There’s instant gratification with an expressive nose layered with red and blue berry fruit and pepper spice. On the palate, it expands, bursting with juicy blueberries, smoky tones and black liquorice. It’s richly fruited, savoury and fresh, with a mineral line and chalky tannins that frame the mouth-watering fruit. Delicious. There’s around 15% whole-bunch this year. 2022 Chambertin, Grand Cru, Jean-Marie Fourrier As with Fourrier’s Latricières-Chambertin, this old-vine plot (a stately 70 years) is up against the Route des Grands Crus. The nose is instantly intoxicating with a violet perfume and depth of dark fruit that soars from the glass. The palate is concentrated, laden with sweet fruit, yet driven with remarkable finesse and freshness. Persistent and pure, with a weightless quality, this is another great wine from Jean-Marie.
 2022 Bâtard-Montrachet, Grand Cru, Domaine Faiveley Faiveley has a plot of 0.35 hectares here. The 2022 is an exceptional wine – with a nose that is waxy, chalky and creamy – but beneath these savoury and mineral aromas there is a wine of such density and fullness. There is layer upon layer of flavour here, working through from mineral tones, citrus and yellow-fleshed peach, grilled almonds, honeysuckle and creamy intensity. It flirts with fatness, the rich fruit rolling around the mouth luxuriously, yet there’s a pithy bite that brings it back from the edge – giving tension as the acidity drives on to a bright, sherbet-edged finish. 2022 Gevrey-Chambertin, Premier Cru, Les Goulots, Domaine Heresztyn-Mazzini This cool vineyard is at the top of the village, just north of Combe aux Moines and sitting above Champeaux. In 2022, it’s one of the most charming wines in Heresztyn-Mazzini’s line-up. They used 50% whole-bunch this year to bring more delicacy. It opens with sweet, ripe red fruit on the nose, but the palate is much more serious. The fruit is elegant and suave, with a brightness and transparency. The crushed raspberry and tart cherry is complemented by white-pepper spice and the fine-grained grip of chalky tannins. This site’s cooler position clearly thrived in 2022 – superb. 2022 Chambolle-Musigny, Premier Cru, Les Feusselottes, Maxime Cheurlin Noëllat This négoce bottling from Maxime Cheurlin (of Domaine Georges Noëllat) shone at our tasting – one of the finest Chambolles we tasted anywhere, in fact. The nose offers classic Chambolle perfume – a scented bouquet and bright, dainty, detailed berry fruit. On the palate, it manages to be both creamy and crunchy, with a sappy, mouth-watering freshness and intensely mineral backbone that drives on to the long, saline finish. Five barrels were produced. 2022 Marsannay, Au Champ Salomon, Domaine Charles Audoin Cyril Audoin and his father constantly debate which of Champ Salomon and Favières is the better plot in Marsannay. They’re both extremely impressive in 2022, although the Champ Salomon is offering more at this youthful stage. The nose is creamy, scented and sweet, enticing with plump strawberry and raspberry, then there’s a rush of juicy bright fruit that fills the palate – powerful, expansive, dark yet bright and crunchy berry fruit. There’s a pleasingly bitter, hickory-smoke edge, along with lifted peony and violet tones. Lush, juicy and hard to resist. 2022 Le Montrachet, Grand Cru, Remoissenet Père & Fils Remoissenet’s Montrachet is always a favourite of ours and it’s no different in 2022. The nose offers grilled almonds, acacia honey and gunflint – just hinting at what is to come. The palate is remarkably concentrated, layered with swathes of peachy fruit and lemon pith, with a zesty, flinty power. It’s immensely ripe and full, but still beautifully elegant, with freshness that balances the wine’s concentration. A wine that deserves time and will only get better in bottle. It’s all in one-year-old oak this year. 2022 Griotte Chambertin, Grand Cru, Charles van Canneyt From the smallest of the Chambertin Grands Crus, this is the pièce de resistance of Charles van Canneyt’s line-up in 2022. From a plot of vines that are over 80 years old, this is graceful, ethereal, sensual and persistent. It is absolutely complete, with notes of spice, bright red fruit, a touch of sweetness and something minty. There’s no doubt that this is a big wine – as a Grand Cru should be – but it’s medium-bodied, round and fresh with fine-grained tannins, and a long, suave finish full of raspberry and strawberry fruit. This is still young but what a wine – give it a decade before you crack a bottle, if you can resist. Four barrels were produced. 2022 Chablis, Grand Cru, Moutonne, Domaine Long-Depaquit, Albert Bichot In 2022, Domaine Long-Depaquit’s monopole Grand Cru captures the balance of the vintage. It is the most mineral-driven cuvée in the range, with an elegant nose than ranges from lemon zest to white blossom, over a layer of wet crushed rock. On the palate, the wine reveals superb concentration, and is much broader and richer structure than the nose suggests. A backbone of acidity drives towards a beautiful finish full of tension, with hints of salinity that makes you salivate. It will need a few years before it shows its potential. Unfortunately, a large part of the vineyard (the lowest part, neighbouring Fèvre) is being replanted and volumes this year are therefore smaller than we’d have liked. It is nonetheless a fantastic showing – and is undoubtedly our favourite Grand Cru from Long Depaquit in 2022. Drink 2028-2040. 2022 Puligny-Montrachet, La Rue aux Vaches, Alvina Pernot From a village parcel just below Les Pucelles and Clos des Meix, this is always so different to Clos des Noyers Brets – with fleshier fruit. It’s playful on the nose, with different facets and fruits emerging with air. It’s broader on the palate, revealing its proximity to Premier Cru territory. A fantastic showing, it’s the best edition of this wine to date. With only a barrel produced, it’s bottled exclusively in magnum.

Burgundy 2022: our favourites

Many factors come into play when tasting Chateau Musar vintages. Was it a warmer Cabernet year (1999, 2000, 2005)? Was it cooler, making Cinsault more influential in the blend as in 1998? Or was it a Carignan year like 2003? Will grape prominence be less relevant than the dodging of bullets across the Beka’a in a vintage we’re lucky to see the appearance of at all?  The tasting notes that follow shine a light on the vintage, the weather conditions, and the family events that helped shape the wines. There is also an insight into the mindset of the winemaker, Serge Hochar, as he became less influenced by his background in Bordeaux and increasingly confident in the wines emerging from his own terroir in Lebanon. Hochar family wines live for a long time and their flavours linger in the mouth and memory long after the bottle is drained. Some of these wines have been tasted à point, at the peak of perfection, but many have yet to reach this moment, and they are judged on their potential. Even more fascinating, perhaps, are the notes on wines that are perhaps just past their prime, but still delivering fascinating nuances that astound the taster – some of these wines elicit the most evocative tasting notes of all. For the Hochar family, a new wine, however shapely or pleasing, is always pregnant with promise for the future. Many of the notes below show the best that the wines can be – but they also underline the fact that for each taster Musar’s most sublime moment will be different. Although the Hochar family does not believe in the concept of defining a wine with numbers, ratings have been included to give some guidance.  Jancis Robinson MW, Bartholomew Broadbent and Steven Spurrier award marks out of 20 for each wine. Michael Broadbent prefers a five-star scoring system. All notes were taken in 2018/19 with the exception of Michael Broadbent’s. Chateau Musar: the reds One-third of Cabernet Sauvignon, Cinsault and Carignan, aged for a year in French Nevers oak. 2013 Chateau Musar  "Dense, deep red, still hints of purple at the core and little age on the rim. Marvellously warm Mediterranean fruits on the nose, autumnal in style but youthful in their rich, robust, vigorous presence. The essence of Lebanon in a glass, rich with spice and cooling breezes, the dry, herby fruit flows with energy over the palate before giving way to a finish that confirms the structure, fruit and tannins blending exuberantly with intriguing hints of much more to come in the next decade." Steven Spurrier, Score: 18/20, Drink: 2020-2040  2009 Chateau Musar  "Mid-crimson. Light, sweet start. For the moment it’s a little simple. Bright, ripe red fruit. Slightly burnt edge. Lots of tannins. Quite dry and youthful on the finish. Much longer bottle age needed. By far the most youthful wine in this vertical tasting." Jancis Robinson MW, Score: 17+++/20, Drink: 2028-2050  "Deep ruby colour but light translucent rim. More primary sweet baked red fruit notes and a lovely bloody, cured meat Rhone character. This is a complex nose – sweet candied blackberry, raspberry, cardamom, tobacco – a very pure nose.  Dense tannins still not fully integrated but will get there and very well balanced with a vibrant line of acidity running through the palate. A real Italian flair to the wine but the tannins are so silky, beautifully handled. Still plenty of life in this wine." FINE+RARE 2008 Chateau Musar  "Heady and beguiling with a gamey note on the nose. Very sweet and young; well balanced on the palate. No hurry at all to drink this youthful ferment. Very tight, dry wine that is so much younger than any other vintage tasted. So much more youthful than a Bordeaux 2008!" Jancis Robinson MW, Score: 17.5+++/20, Drink: 2025-2045 "After blending, [Head Winemaker] Tarek [Sakr] was raving about this vintage. I asked him to add 0.5% of any wine he liked and we’d taste it again in two weeks. An act of faith or la folie? We tasted it again. He raved again; the wine had changed colour and bouquet." Serge Hochar "Dark, blood red. Really powerful nose with tonnes of young, juicy blue and red fruit. Behind this, layers of dried fruit emerge (prunes and raisins) and tobacco, generally a much darker and more brooding profile than the initially youthful nose suggested. Leather and smoked meat, as well as mineral graphite, but also fresh mint and liquorice. Complex and ever-changing in the glass that invites you to keep going back and discovering more. Again, fantastic acidity, plus velvety tannins." FINE+RARE 2003 Chateau Musar  "Mid-garnet. Quite a bit deeper and younger-looking than even the 2001. A little marine influence (oyster shells?) on the somewhat reticent nose. Rather different from many of these Musars. Sweet start and very vigorous and fun. If I had not tasted vintages back to 1961, I might have taken this for a fully mature wine. It already gives masses of pleasure with some milk-chocolate notes and quite a bit of light dry tannin on the end. Excellent drive. Long and dramatically big, but with good freshness on the finish." Jancis Robinson MW, Score: 18.5/20, Drink: 2016-2035 "A vintage with high alcohol and acidity. Rainiest winter in 15 years, then not a drop of rain from April throughout a hot, sunny summer. Heatwave during flowering reduced the harvest by 30%." Tarek Sakr, Head Winemaker "Darker than more recent vintages, gun smoke, spice and hints of leather. Rich darker fruit, riper with dense, sweet mid-palate. Balanced though, with Cinsault contributing acid and vibrancy that is often absent in 2003s. Fruit profile is richer and darker and tannins riper and juicy, perhaps not as refined as the excellent 2008, but still with Musar DNA. Smoked meat and charcoal. Delicacy throughout. Fascinating and delicious." FINE+RARE
 2000 Chateau Musar  "Reasonably mature. Brick-red rim, autumnal faded red bowl. Mouthwatering acidity on the nose that can be smelt a foot away. Lovely aromas of damp autumn forests, decaying leaves and wood combine with a slightly chocolatey sweetness. A little spirit developed over the course of the evening: almost a Drambuie or Grand Marnier character. Slightly sweet on the palate with very long, classic autumnal Musar notes, soft, mature and Old World, braced by that lovely acidity. Still full flavoured and crisp on its long, lingering aftertaste, finishing with notes of liquorice and sherbet." Bartholomew Broadbent, Score: 18/20   "A Cabernet Sauvignon year. One of my clients called it 'a lioness' of a wine." Serge Hochar "Bright ruby red with the start of some brick around the edges. Sweet fruit, baked strawberries, rosewater and pomegranate. Peppery spice. Some leather and petrichor. With more air, burning embers and deep, meaty fruit and spice. Lovely sweet tannins on entry. Elegant and fresh, but with an enveloping warmth and caressing softness, though it remains both light and structured thanks to the depth of flavour and superb acidity." FINE+RARE  1998 Chateau Musar  "Pale, jewel-bright garnet. Light, spicy, particularly well-integrated nose, already well developed. A sweet start on the palate; the opposite of heavy; a really lovely wine: fresh, sweet, with some very slight mintiness and a dry finish. Very long, and nicely mature: seems just right now. It will go beautifully with food. One of my favourite wines in this collection. Is it the Cinsault I like so much?" Jancis Robinson MW, Score: 18.5/20, Drink: 2012-2030 "Tarek said: 'Let’s bottle at the end of the second year. Let’s try!' We did 20,000 bottles like this, then the rest a year later, as usual. We tasted the wines four years later. Something was missing in the earlier-bottled wines. They had an obvious Chateau Musar character but were not necessarily better. Identity is permanently important. We went back to the original formula." Serge Hochar "Cool year, Cinsault dominated. Cold and rainy until June, with a sunny, dry summer. Harvest began on 9th September." Tarek Sakr, Head Winemaker  "Similar in style to the 1997 but with more fruit concentration, the aromas more earthy and
dried leather, but the lifted perfumed floral tone still dominates on the nose: dried roses, sweet licorice, candied cinnamon – lovely additional set of oak flavours that add aromatic complexity. Lovely texture – tannins are seamless – silky and long – provide structure but are sweet and resolved, backed by vibrant acidity keeping the wine fresh. Fruit is plump, rich, ripe, very much on the red fruit spectrum – raspberry, red cherry. Great acidity. Light fresh tobacco and light leather notes coming through on the finish. Great integration and drinking very well now. Difficult to pick between the '97 and '98 – the '97 is more ethereal – it tastes like quality aged Burgundy! '98 is plusher and more concentrated but less ethereal." FINE+RARE
 1997 Chateau Musar  "Very light in colour with maturity on the rim: salmon ruby. Surprisingly intense and concentrated nose with strong ash and autumnal smells; great acidity, damp leaves and old bonfires. On the palate, very sweet fruit and a long finish that goes through several evolutions (one developing old pomegranate flavours) in the longest aftertaste of any Musar. Full mouthfeel defies the lightness of the wine. Almost chewy in texture. Intense volatile acidity." Bartholomew Broadbent, Score: 18/20  "We had two harvests – before and after a week of heavy rain – and made a big, big wine. Two years after bottling it changed direction and began to create heavy sediments. It was the biggest surprise in my life. This wine was behaving like a human going through an adolescent crisis. Which way is it heading now? The only thing I know is that I trust my wines. It is already an interesting wine, and starting to taste beautiful." Serge Hochar "Translucent Pinor Noir-esque colour with tremendous clean aromatics – lifted floral notes,
fresh aniseed, scented aromatic tea leaf, red cherry, strawberry, pomegranate, so perfumed. Seamless tannins, silky soft but there is a delicate framework and the fruit concentration provides lovely depth. Fruit remains very fleshy. Very clean considering the age, and lovely refreshing, vibrant acidity, remarkably stable at 24 years of age. Lovely, ethereal quality to this wine, reminds me of a great aged Burgundy with the acid and florality!" FINE+RARE 1979 Chateau Musar  "…misleadingly pale, fully mature; nose like squashed strawberries; sweet, long, delicious." "Slightly sludgy rust colour. Sweet, rich and thoroughly exotic. Old leather handbags? With some biscuit slurry (dunked, not-too-gingery ginger nuts?). Ethereal and lifted. Beautiful sweetness as it hits the palate then real freshness and super-clean, thoroughly mature aromas. Gloriously mature but not at all old. Does taste like a wine from a bygone age… Long and rich on the finish. Amazing to think that Cinsault can last this long. No variety imprints itself. Perfection on palate: full fruit and a great mouthfeel, with sweetness, length, great texture and perfect evolution; a little spicy and hot on the finish. Like an old Bordeaux but with better acidity, then a lovely aftertaste that conjures up the bonfire smells of autumn country walks. At its peak now. One of the best Musars I’ve ever tasted." Bartholomew Broadbent, Score: 20/20  "That summer I was invited to Château Langoa-Barton for an internship with Ronald Barton. What I saw, tasted and learned there affected me. If I had to describe myself, I was a civil engineer who made wine and who had started to discover the complexity of wine. I was trying to understand, to observe. I knew that nature will never repeat herself and for a while I thought I might change all the grape varieties that we were growing, but to plant grapes and make good wine takes 20 years, and what if I was wrong?  "However, I experimented a little with Grenache, Mourvèdre and Merlot. Looking back there were three stages to my winemaking. Between 1959 and 1964 I was making wines without an objective, with what we had at hand. From 1960 to 1970, having studied in Bordeaux and been influenced by Saint-Julien and Saint-Estèphe, I now realise that I was trying to produce wines in that style. barriques (25% new each year) where they mature for a further nine months. They are then
blended, bottled and aged for a further six to eight years before release. 2012 Chateau Musar  "Fine fresh-looking lemon-yellow, but shows reassuring maturity. Dry honey and spices on the nose; a controlled richness of fruit on the palate that reminds me of Ygrec: complex, dry but with sweetness in its DNA before natural acidity lifts the exotic aftertaste. Lanolin smooth but not easy to assess (and not meant to be at this stage). Young white Musar that retains its mystery." Steven Spurrier, Score: 18.5/20, Drink: 2020-2035 2000 Chateau Musar  "Medium depth golden-yellow; no maturity showing. Still very closed on the nose, subdued, with a light floral nettle aroma. A bit astringent on the palate, but with mellow, soft textures and good acidity too. Needs time. By the next morning, the nose had come alive. The palate was beautiful, like a spicy Petite Suisse cheese, with great length. Nose continuing to develop on day three." Bartholomew Broadbent, Score: 18/20 1992 Chateau Musar  
"Deep orange gold. On the nose, beginning to mature and open up. Good depth and concentration. Lovely flavours of old Cheddar and surprisingly high acidity. Very good length on the aftertaste. Will age for a long time. After an hour in the glass, the wine started to develop characteristic honey aromas that also revealed themselves on the palate alongside a beautiful vanilla and beeswax aroma. The next morning saw it develop a rich, sweet, cognac-like nose; bone dry, powerful yet elegant on the palate with pronounced alcohol and a long finish. By day three, the middle nose had developed even more." Bartholomew Broadbent, Score: 18.5/20 "The weather was terrible. We had winter until June. Hail came. Biblical weather! I tried to make a Chateau Musar red, but two years later found it wasn’t up to standard, so we distilled it. The best grape that year was white Obaideh." Serge Hochar 1975 Chateau Musar  "Deep orangey gold; looks like a late harvest wine in colour. Nose; wow! Incredibly intense, concentrated, dry, very deep and austere: a combination of leather saddles, barnyard and old mahogany musky characters with mouthwatering citrus orange acidity. Astonishing complexity and intensity on the palate, with a syrupy texture. Massive, deep powerful, concentrated and long. Delicious flavours keep changing like a kaleidoscope in this mouth-filling but elegant wine. On day two it had aromas of sweet Australian ‘Tokay’ and a bite of cognac-like alcohol." The rise of Chateau Musar is legendary. We take a closer look at the vintages that have cemented the Lebanese estate's enviable reputation in the hearts and minds of critics and collectors alike.

Exploring the vintages that have made Chateau Musar such a fine wine icon – from 1972 to 2013 

Chateau Musar tasting notes year by year

It was the vision of Jacques Perrin in particular – who farmed the property organically from 1950 onwards – that cemented Châteauneuf-du-Pape’s Château de Beaucastel reputation. Today his sons – Jean-Pierre and François – are at the helm, with fifth-generation Marc, Pierre, Thomas, Cécile (Jean-Pierre’s children) and Charles, Mathieu and César (sons of François) also all work full-time at the estate. All seven of the children worked in wineries around the world before returning to the family estate.  A visionary estate The estate was one of the first in Southern Rhône to become organic (in 1950) and then biodynamic (in 1974), making the vineyard better prepared than most for the climate change effects over the last 30 years.  “Beaucastel is the largest Châteauneuf-du-Pape estate in one contiguous plot and it stands at the most northern limit of the appellation. It is a vineyard which is therefore very exposed to the Mistral winds, which has a huge cooling-down effect,” Emmanuel explains, protecting the vineyard from extreme temperatures.  The vineyard is based on a limestone bench covered by a rather atypical mix of clay and sand, topped with diluvium “galets roulés” (pudding stones). It is an incredible terroir that, Emmanuel explains, “allows us to combine power and finesse even in the driest vintages. It has always been considered a benchmark terroir in the area and was in fact a cru before the Châteauneuf appellation was created.”  
The biodynamically farmed old vines have also helped offset the ever-increasing drought pressures in the region. “We are extremely fortunate to have older vines,” Emmanuel says. “The galet roulés covering our vineyards also help prevent water evaporation. So all in all we’ve managed to make great wines even in warmest and driest vintages.” That hasn’t stopped the domaine, however, from continuing to adapt their methods to better cope with the ever-present threat of climate change. “We are learning more and more every year and continue to implement changes we deem necessary.” Alcohol levels in the region have undoubtedly risen, an effect that the estate looks to counter. 
When Jacques Perrin was in charge, he created a very specific vinification technique which he later patented. He would heat up the must to 80˚C, to start fermentation quickly while allowing Jacques to use less Sulphur, helping fix the colour of the wine, particularly with the Mourvèdre grape which has a tendency to lose colour with age. But this method also reduced the greener flavours in the wine, that came from less ripe grapes. 
Today’s climate, however, does not face the same issues, with consistently riper fruit. As a result François and César have phased out this technique, instead opting to whole-berry fermentation, and even whole-cluster ferments for varieties like Syrah, to naturally reduce alcohol levels. These days they also pick earlier, opting for more freshness whereas in the past it was always the goal to maximise ripeness, something that no longer is an issue for the region.  “The estate is always looking at ways to counter the issues of climate change,” Emmanuel continues. “For example, some of the younger Syrah vines are today producing very powerful wines so we are either co-ferment with some Grenache, reincorporating some of the stems in the vat or carry out whole-cluster fermenting,” helping to find better balance in
the wines. In the vineyard too, the team is constantly looking for ways to improve. “We recently tried spraying clay on leaves to limit photosynthesis,” Emmanuel says. The initial experiments have proved positive, but it is still too early to see the long-term effects on the wine
and requires further testing. 
But this experimental approach is everywhere in the property. They continuously make alternate blends that they age in the Beaucastel cellar and over time compare with their main cuvées to see how well the final blend develops versus a different potential version of
the same wine: Emmanuel states the cellars are full of these experiments. 
The domaine has also been assessing how the Beaucastel wines age with different fining techniques. “We do a lot of comparative tastings and assessing of older experimentations. For example, we recently did a horizontal of Château de Beaucastel 1996, where each bottle was fined differently, and identified which fining technique works best for ageing the wine – this is crucial in the development of our knowledge and helps us to make sure decisions taken in the moment are the best ones for the future.” 
Hommage à Jacques Perrin What is distinctive about Château de Beaucastel and the Hommage cuvée in particular is the high proportion of Mourvèdre in the blend. The Hommage is typically made up of 60% Mourvèdre. Emmanuel explains, “Hommage is from our Courrieux lieu-dit parcel, where Mourvèdre was first replanted (post-phylloxera) in 1910. As Mourvèdre is such a late-ripening
varietal, Château de Beaucastel needs an outstanding Indian summer to hope for an Hommage vintage. The decision thereafter is taken during the blending tastings. 
“When tasting the foudre of Courrieux back in 1989, François and Jean-Pierre were overwhelmed by the outstanding quality and knew that it had to be bottled on its own. Jacques Perrin’s intuition for the best blend from the estate revolved around a dominant proportion of Mourvèdre. As a tribute to their visionary father, they followed his instinct and
dedicated this unique cuvée to him.”  Production remains tiny despite the huge demand for the wine. In recent vintages, production has been around 6,000 bottles per year. The only difference in the vinification process of Hommage versus their other cuvées is an extra six months’ ageing in 4,000-litre foudres. All the winemaking is fairly hands-off, vinifying all the varieties separately apart from the Muscardin, Vaccarèse and Terret Noir which – due to the tiny quantities – are co-fermented. The reductive varieties – Syrah and Mourvèdre – are fermented in open-top wood fermenters and the remaining oxidative varieties are fermented in concrete tanks prior to the all-important blending sessions with the family.  The 2018 vintage has already been fantastically reviewed, awarded a potential perfect 100 points from the Wine Advocate, with reviewer Joe Czerwinski describing it as “full-bodied
but incredibly silky, combining great purity, richness and length into a seamless, elegant package that should give immense pleasure for decades to come.” The success of the 2018 vintage, according to Emmanuel, was “down to the perfect ripening conditions in mid-October, allowing them to bring the grapes of this late-ripening variety in at perfect maturity – 2018 was fantastic for Mourvèdre.” 
The grapes of the Southern Rhône 
Château de Beaucastel proudly uses all 13 permitted varieties of the Châteauneuf-du-Pape appellation. Some even say 18 varieties, since varieties like Grenache, Terret, Clairette and Piquepoul all have a black, pink and grey clone of the variety mixed within the vineyards. “Each variety brings its own attributes that differ depending on the vintage, but also depending on the amount you use or the blend you make,” says Emmanuel. “For example, when you open a young Beaucastel, it’s very Grenache-driven, even when there is a similar percentage of Mourvèdre. It’s only few years later that Mourvèdre will finally come to the
fore, revealing game, leather and savoury characteristics. “Individually, Mourvèdre brings power and structure, but when you open an older Beaucastel it delivers freshness and silkiness. Grenache Noir brings kirsch, plum and cassis fruitiness. Syrah adds color, tannin and spices, and when blended with Mourvèdre and Grenache it
brings truffle notes.  Counoise can be considered the Pinot Noir of Châteauneuf-du-Pape and has a distinctive white pepper note. Cinsault adds freshness, Muscardin and Vaccarèse are very floral and add freshness, Terret Noir is light even in colour and adds acidity. The white varieties of Roussanne and Grenache Blanc bring elegance and freshness. Clairette is very aromatic and brings unctuosity. Bourboulenc adds tension with notes of almond and vanilla, Piquepoul richness and Picardan adds a lot of bouquet.   “For us it is very important to have all the varieties to make an elegant and balanced wine. However, above all, it is the knowledge and the art of blending, passed on from generation to generation of the Perrin family, that is the key to understanding the real expression of Château de Beaucastel terroir.” With experimentation at the heart of the Perrin philosophy, the infinite potential of blends when using so many grapes in the wine keeps the extended Perrin family busy monitoring their blending decisions as the wines develop with age. This bottle is first and foremost a Grand Cru of Pinot Noir, and we love the Grands Crus of Pinot Noir in both Champagne and Burgundy. Following a bottle of our own Grand Cru – Hommage au Pinot Noir and an MV10 Champagne, of which both would have benefited from a few years of aging, I will serve the Romanée-Conti. I like to drink these wines quite early in the meal, their fragrance, their voluptuousness, and their precision make me happy to continue the meal. This bottle is also a memory of the person who gave it to me on one of my trips to Japan. I will call my friend on this occasion. Thanks to my wife Anne (one of Claude Giraud's daughters) I had the chance to discover some great wines. These wines inspire me every day when I am in the vineyards or in the cellar. They make me want to surpass myself and always go further in precision and excellence. Vega Sicilia is one of those first great Spanish wines which made a deep impression on me. I like them old, after 20 years, 30 or more because this is really where Vega Sicilia fully expresses itself. And then I recently drank in Mexico a bottle of 2011 Vega Sicilia and I was amazed. It is so young and already so beautiful! I told myself that I couldn't keep this secret to myself, I wanted to share it with my family. So, coming back from this trip, I immediately put some in my cellar. And the first bottle will be for Christmas.” Tod Mostero (Dominus) – 2005 Riesling Auslese, Graacher Himmelreich, Joh. Jos. This bottle was offered to me by Michael Grimm (our distributor in Germany) and his family shortly after I returned to California in 2007. He and his family have become close over the years. I will also remember Bordeaux, my spiritual family in Libourne, and the gravelly earth and creamy tones of Pomerol soils with a 1982 La Fleur-Pétrus or the pillar of beauty, 2009 Trotanoy – bottles offered to me by Christian Moueix to celebrate the end of year. It is fun to pour a wine and talk to loved ones of the people and places in the bottle.” Gaia Gaja (Gaja) – 1961 Barbaresco, Gaja “This Christmas more than ever the family will gather in full, at my parents' house to celebrate Christmas together. I can’t wait. It will be a long day of celebration, cooking and enjoying each other’s company. Several wines will accompany us throughout the day and surely will be inspiring to the memories. In particular, I am excited to share a magnum of Barbaresco 1961 because this year we are celebrating the 60th anniversary of my father’s great career and this wine was his first step – the first vintage made by him when he was just 21!” Thomas Duroux (Ch. Palmer) – 2009 Malvasia delle Lipari Passito, Caravaglio, Sicily “In July 2011, I went for the first time to Salina, one of the seven Aeolian Islands. I had a little knowledge of the wines produced there but I did not know Antonino Caravaglio. We spent a lot of time together and I had a chance to taste several Malvasia from his estate. I took the hydro-foil ferry back to Sicily along with six bottles of his 2009 Malvasia delle Lipari. This sweet wine, made with dried berries from Malvasia grape variety develop extraordinary aromas with age, such as rosemary bush and dried apricot. This is really something that does not exist anywhere else. I plan to open the first bottle this Christmas and this wine will be my second daughter Gabrielle’s, born in 2009, first sip of wine!” Chris Riesbeck (Westland Distillery) – Garryana Edition 6 “For the holidays, I love to go with big Sherried malts during the colder months – our latest Garryana Edition 6 is just absolutely wonderful. It combines what I love in Sherry (dried fruits) with classic Garry Oak notes of ginger, clove, barbecue smoke. We used quite a bit of ex-Calvados and fruit brandy casks as well, so it’s this fantastic bouquet of candied fruit and smoke (not peat). Aside from that, I have a running obsession with large format (three-litre for the win!) during the holidays. It’s such a fun treat to share those sorts of things with loved ones. This year I’ve pulled a three-litre bottle of Marcel Lapierre Raisins Gaulois 2017 out of the cellar to celebrate.” Francesco Ripaccioli (Canalicchio di Sopra) – 2013 Chianti Classico Riserva, Vigna del Sorbo, Fontodi “One of the bottles that I will definitely open this Christmas will be Fontodi’s Chianti Classico Riserva Vigna del Sorbo 2013 in magnum. This bottle is so special for me for many reasons, for sure it is one of the greatest wines I ever tried, but behind this, there is a family (the Manetti family) and a man, Giovanni Manetti, who at the beginning of my journey in the world of wine was a great sponsor for me, granting me his friendship and his continuous support. Fontodi has been, and still is today the greatest example of how a family-run estate can stay local, while thinking global. I love the 2013 vintage in all of Tuscany and also Piedmont. The wines mature very slow and this is the sign for me of a great vintage. But we can now already start to enjoy something from it for sure.” Frédéric Weber (Bouchard Père & Fils) – 1999 Beaune-Grèves, Premier Cru, Le Vigne de l’Enfant Jésus, Bouchard Père & Fils “Christmas day is the perfect day to celebrate this wine, so it is an easy choice for me. This is a great wine, from an appellation that today is still too underrated. Historically the top wines from Beaune were the most expensive in Burgundy and can compete with some of the finest. I have chosen 1999 because this was in fact the first bottle I bought from the domaine when I joined Bouchard in 2002. It is a fantastic vintage for Burgundy and is drinking beautifully now. I am looking forward to sharing it with my family this Christmas.” Rebecca Jago (The Last Drop) – The Last Drop Très Vieux Pineau des Charentes “This Christmas, we’ll be opening a magnum of Pol Roger I was kindly given last year but further lockdown meant we just didn’t have the company to drink it all! We have a mix of family and friends for Christmas Day and we’ll open a bottle of Newton’s unfiltered Chardonnay (my husband’s favourite), and some Ch. Talbot 2000. And, with the Christmas pudding, I’ll be opening my bottle of our incredible 100-year-old Pineau des Charentes: I can’t wait to share it with our loved ones. Unfortunately, it will be a sad Christmas for us, as it will be the first without my mum. She sadly passed away in the summer after a hard fight with cancer. So, we will be drinking one of her favourite wines in her memory. She loved Grüner Veltliner from Austria, so there will certainly be a Honivogl from our friends Hirtzbergers in the Wachau, which my mother loved so much. For red wine we will have some of our favourites, a 2011 Romanée-Saint-Vivant from Romanée-Conti and a 1989 Haut-Brion. Noblet and Delmas were for us the best cellarmasters ever on this planet. They both inspire me again and again when I drink their wines. For the sweet end, it will be Yquem again... I drink Yquem maybe three or four times a year. But at Christmas, this world-class sweet wine is always a must! Wines sold en primeur will be released from the producer after bottling, typically 18 months after the so-called campaign ends. Upon arrival your wine will be stored at Vinfolio in our temperature-controlled warehouse until you decide to take delivery.
