To Kalon. For any Californian winemaker, those two words represent the Holy Grail. This vineyard in Oakville, Napa, is undeniably the region’s most famous. Perched at the foot of the Mayacamas, west of Highway 29, this site has been recognised for producing fine wine since the 19th century. Literally translating as the “highest beauty” or “highest good” from Greek, today To Kalon is home to some of Napa’s oldest vines and best Cabernet Sauvignon. “This is a Grand Cru – a premier property,” Paul Hobbs tells me, a winemaker who has a long history with the site. As a grad student at UC Davis, Hobbs would swipe the second crop from a vineyard on Walnut Drive – what happened to be BV4, Beaulieu Vineyard’s original block of To Kalon. At Mondavi – the largest holder of the hallowed site – he got to walk the rows more legitimately, and used those holdings to build Opus One – the company’s joint venture with Ch. Mouton Rothschild (although the association with the site has generally been played down). Under his own label, he’s been making wine from the Beckstoffer section of the vineyard since 1999 – and his wines, along with those from Schrader, were some of the early bottlings that put the vineyard firmly on the fine wine map, earning high scores – and lots of attention. Indeed, it was a Paul Hobbs wine that made Tor Kenward believe the vineyard was truly special. André Tchelistcheff had spoken to Kenward about BV4, but it was one of Hobbs’s bottlings that made him realise its potential. He started working with Beckstoffer plots from 2005. 
“It’s not visually impressive; it doesn’t have that ‘wow factor’,” Kenward tells me. But start digging below the surface, and you realise that you’re in the “tenderloin of Napa”, with old creek beds that run through the site. It’s an alluvial fan that runs down from the Mayacamas, sitting almost on a bench – with very little elevation. But the soils here are varied, with deep, well-drained gravels that make it perfect for Cabernet Sauvignon.  Andy Erickson – a winemaker whose resume includes Screaming Eagle, Harlan, Dalla Valle, Mayacamas and many more – first worked with the site in 2012, on a single-barrel charity lot for an auction at his children’s school. When Constellation (owners of Mondavi and co-owners of Opus One) called him to give him the chance to work with it again in 2016, he didn’t hesitate. That year, he made the first wine for the To Kalon Vineyard Company – a project that is a revival of the brand created by H.W. Crabb (known variously as Henry Walker, Hiram Walker or Hamilton Walker Crabb) in 1886, the vineyard’s godfather. “Most people know the recent history of the vineyard, and the acclaim of the wines from the past 15-20 years. But the vineyard was known for producing remarkable wines all the way back in the late 19th century. Clearly there is something there,” Erickson says.  But this vineyard is weighed down with controversy – its borders endlessly debated, with producers vying for use of the To Kalon name.  The history of the To Kalon Vineyard It’s impossible to look at To Kalon today without tracing its origins. H.W. Crabb came west from Ohio during the Gold Rush, spending six months digging in the Sierras before settling in Oakville in 1868, buying 240 acres of land at the corner of Highway 29 and Walnut Drive. He planted a wide range of crops, first making wine in 1872 under the name Hermosa Vineyards (“hermosa” meaning “beautiful” in Spanish). In 1881, he acquired another 119 acres from Eliza Yount (whose name lives on in Yountville). On land to the west of his plots, owned by John Davis, he planted additional vines – buying the fruit off Davis to feed his increasing production. In 1886, he gave his company a new name: “To Kalon Vineyard Company” – and the legend was born. Crabb reportedly said, “The name To-Kalon… means the highest beauty, or the highest good, but I try to make it mean the boss vineyard.”
 To Kalon Vineyard Company rapidly became one of the region’s largest – and most well-respected – wine producers. His wines started winning awards at competitions around the world, and he was the first to start selling wine along the East Coast. He had planted a huge range of grapes – around 400 different varieties, including Malvasia, Riesling, Chasselas, Muscat, Refosco and Cabernet Sauvignon, with the latter in particular thriving. In 1889, he bought 168 acres on the hillside to the south, close to where Harlan is now based, although it was never planted with vines during Crabb’s lifetime. In 1891, Crabb bought Davis’s 135 acres (from which he’d already been buying the fruit). In total, Crabb had more than 359 acres.  But his success wasn’t to last – phylloxera arrived in the late 19th century, and recession along with it. In 1898, Crabb sold the 135 acres he’d bought just eight years earlier – and died one year later in 1899. The vines were ripped out, replaced by cherry trees under David Perry Doak in 1911, who in turn purchased another 500 acres of vines from John Benson, south of the border of the original To Kalon (across Oakville Grade Road), which is now all owned by Constellation (used for Mondavi or Opus One). After Crabb’s death, what remained of the To Kalon Vineyard Company was sold to ES Churchill at auction, taken over by his widow Mary Churchill when he died in 1903. Wines continued to be sold under the label until the arrival of Prohibition in 1920. The winery reopened briefly to sell wine in bulk in the 1930s, but the winery building burnt down in 1939. Four years later, Martin Stelling bought most of the property – 337 acres – and replanted. He sold 90 acres to Beaulieu Vineyard (the block that became known as BV4 – and was the plot used by André Tschelistcheff made Georges de Latour Reserve). In 1944, Stelling bought an additional 1,700 acres – the McGill Ranch, which included the parcels owned by Doak (both Crabb’s 1891 parcel and the 500 acres area south of Oakville Grade Road). He named the entire property Tokalon Vineyards, and in 1945 planted Sauvignon Blanc in I Block – the legendary parcel that is today used for Mondavi’s prized, old-vine To Kalon Fumé Blanc.  Tragedy struck again, however, with Stelling killed in a car crash in 1950. The property was once more divided, sold off in pieces by his widow.   
Rosa Mondavi, along with her sons Robert and Peter, purchased 132 hectares in 1962 for the family winery, Charles Krug. After Robert struck out on his own, he bought 12 acres for himself in 1966 (that remained in the Stelling family) – in the northeast corner of the 1968 Crabb parcel, where the Mondavi winery and visitor centre remains today. He bought a further 230 acres in 1968, and then took the Charles Krug section from the rest of his family in 1978. The first time the To Kalon name appeared on a Mondavi label – and the first time since the demise of the To Kalon Vineyard Company – was on the 1986 Fumé Blanc Reserve. The I Block – the Sauvignon Blanc vines planted by Stelling in 1945 – were singled out for the first time in 1995, for the vines’ 50th anniversary. The first red – Mondavi’s To Kalon Reserve Cabernet Sauvignon – appeared with the 1997 vintage. The To Kalon Vineyard’s terroir As already mentioned, To Kalon is largely an alluvial fan that stretches down from the Mayacamas to Highway 29. It is, however, a large piece of land (the exact area depending on where you draw its borders – see below for more on the controversy around this) – and as such the terroir varies considerably. The soils are richer downslope, closer to the Highway; poorer and better-drained higher up (where many – including Hobbs and Kenward – prefer to be). The gravel composition varies with the subtle slope differences and underground water.  “It’s like any cut of meat – there are better parts than others,” Hobbs says. With over 300 original acres (at least), this is a substantial vineyard (for comparison, Clos Vougeot is 125 acres). “It’s great if you have the name To Kalon, but could be pretty average stuff.” The Beckstoffer section is numbered and lettered: A to F, from road to mountain, with A1 south of A2. For Hobbs, he likes the blocks closer to the mountains, and those that aren’t shaded by the huge walnut trees that line Walnut Drive (to the south). Hobbs noted how much warmer Oakville is than Yountville – something he used to notice when driving in the evening home from Oakville to Yountville. The mountains block the sea breezes, meaning that the cooling effect happens, but more slowly. This is partly what makes it such a special place. Tor Kenward similarly prefers some of the middle blocks in B and C, where there are some of the vineyard’s oldest vines, but with lower vigour, as well as the leaner soils closest to the mountains. As for the MacDonald or Horton block: “You could argue it’s every bit as good as Andy’s piece,” Kenward says. It, along with the Detert block, was planted in the 1940s – and in fact those two blocks are now home to some of the valley’s oldest vines. Even closer to the mountains, the gravel content is even higher, and the fruit is picked up to a month earlier than elsewhere in To Kalon. Although until now most of that fruit has been sold to Constellation, there will be opportunity for others to work with it as that contract comes to an end.   
The Beckstoffer plots of To Kalon Andy Beckstoffer bought Beaulieu Vineyard’s block, BV4, in 1993. He’d just lost a prized site – Liparita, on Howell Mountain – when the 89 acres of BV4 came up. He’d worked the site for years and leapt at the opportunity to buy it. “It’s a mystery to me why they sold it,” Paul Hobbs told me, although word on the grapevine was that they needed to liquidate funds – indeed, it was around the same time that Mondavi went public for similar reasons. Phylloxera was once more raging through the region thanks to the widely used, non-resistant AXR rootstock.  The BV4 block was in bad shape when Beckstoffer took it over and he had to replant the entire site. Paul Hobbs was one of the first to use fruit from Beckstoffer’s plots, starting to work with him from 1995/96. “Andy didn’t really realise he had a Grand Cru property,” Hobbs says. Hobbs was given free rein to pick his plots, opting for four or five plots on the western side, furthest from Highway 29. The vineyard produced its first fruit in 1997; 1998 was a difficult year; but in 1999 Hobbs was able to produce his first To Kalon bottling (although it couldn’t say so on the label). “I was loathe to tell people how young it was – but the quality was so good,” Hobbs says, still starry eyed thinking about it. “It was only four years old, but producing stunning wines.” Most fruit is sold on its weight, by the ton, but Andy Beckstoffer created a different model – one that is intricately tied to the vineyard’s name and reputation – and arguably has increased its reputation. Producers who use his fruit pay him 175 times the bottle price per ton, with a ceiling at $50,000/ton; tying the value of the fruit to the value of the final wine. “For producers like me in those days, when I didn’t have the land or ability to buy land, Andy was a saviour of sorts,” Hobbs tells me. “Because I had access to one of the top vineyards in all of Napa. I had to pay – but at least I had access.”
  The To Kalon controversy: how big is it? And is it a brand or a place? Mondavi trademarked the name “To Kalon” in 1988, and “To Kalon Vineyard” in 1994. This gave them the right to use the name on any wine from anywhere – even beyond California – and meant that no one else could use the name, even if they had plots in what was considered the original To Kalon vineyard. The first Beckstoffer bottlings only mentioned the name on the back label; but in 2000, Schrader decided to put it on the front label. The now famous lawsuit commenced. “They shouldn’t have been able to trademark it,” Hobbs tells me. “Anyone from the original To Kalon estate should have the right to the trademark as well.” In 2002, Mondavi sued Schrader for using the name on their Beckstoffer bottling. Countersuing ensued, from both Schrader and Beckstoffer (the latter arguing that Mondavi was misleading clients by using the name for wines made with fruit from beyond the vineyard’s original borders). A settlement – the details of which remain a mystery – was made in 2003, but wines made from the Beckstoffer section can now bear the name “Beckstoffer To Kalon”.  Constellation bought Mondavi in 2004, and then Schrader in 2017. Reportedly attempts were made to trademark “To Kalon Wine Company”, “To Kalon Vineyard Company” and “Rooted in To Kalon” – something, unsurprisingly, that Beckstoffer objected to. The legal battle continues today, with a fight over the naming of To Kalon Creek, and The Vineyard House – owned by Jeremy Nickel, which sits on the 1889 hillside section – arguing for the use of the name as well.  The borders of the vineyard are a constant source of debate – and given the history above, you can see why.  Andy Beckstoffer considers the original To Kalon to be only the parcels bought by Crabb in 1868 and 1881. The 1889 parcel was never planted by Crabb, so most aren’t inclined to include it as “original To Kalon”. The Detert and MacDonald plots, however, aren’t acknowledged by Beckstoffer, but were planted – and, albeit more briefly than other plots, owned by Crabb. Then there’s the “Stelling extension”, the southern section added after Crabb’s death under Martin Stelling, that Mondavi considers part of the original vineyard, but some others do not. Given the sums fruit – and wine – bearing the To Kalon name command, it’s unsurprising that its usage is so disputed.  
To Kalon: what does the wine taste like?  So what makes the wine so special? Why do winemakers fight for the fruit, and consumers for the bottles they produce? Despite the sheer variety of the site, Tor Kenward is adamant that there’s a continuity, with a profile that that site gives Cabernet. He describes it as “wall-to-wall carpeting”, a plushness to the mid-palate, a softness, that means the Cabernet isn’t hard-edged. “There’s something about the ground there,” Andy Erickson agrees. For him, To Kalon has a distinct tannin texture – not as rugged as hillside sites, but richer, with a generosity in the wines. “They are dark, aromatic, but very broad and polished,” he says. “I think the vineyard brings forward many of the complexities of Cabernet Sauvignon, but delivers it in a very approachable and elegant package.” “It’s very identifiable,” Paul Hobbs says. “It’s a structural and textural thing mostly. It’s a freshness to this sort of tannin. It has grip, but it has this uplifting character.” He explains it like a skipping stone – you think you’ve got it, then another wave comes, the wine shifting on the palate. For him, one of the most distinctive things is that Cabernet sings alone here – much better than blended with other varietals. “It didn’t need the help of its brothers,” he says. “It’s a wine that’s at peace with itself… It doesn’t shock you, except in its beauty.”
 Who owns what today in To Kalon? Robert Mondavi: From the original 12 acres, Mondavi now owns 328 acres of To Kalon, including the Stelling extension. Has the rights to use the To Kalon name.  Opus One: The 35-acre Q Block was sold to the joint venture by Mondavi in 1981, with K block acquired in 2008. Although under Constellation’s ownership they could likely use the To Kalon name, Opus One doesn’t trade on this. (To Kalon Vineyard Company uses fruit from Constellation’s holdings, both Opus One and Mondavi plots.) UC Davis: a research block that was key in developing phylloxera-resistant rootstock
Beckstoffer: 89 acres, with fruit sold to a range of producers (currently 23), including Paul Hobbs, Tor Kenward and Schrader. Producers can use the name “Beckstoffer To Kalon” on their labels. MacDonald (sometimes referenced as Horton): Graeme and Alex MacDonald are the current generation, owning 21 acres of the 1891 parcel. When their great-grandparents bought the site in 1954 (along with the Detert plot – see below – from Caroline Stelling, Martin Stelling’s widow) it was planted with cherry trees. Advised by Robert Mondavi, the MacDonalds planted vines. From 1966, they sold grapes to Mondavi – holding some back for personal use from 2004, with the first MacDonald commercial release in 2010 (just 92 cases). Although historically 75% of production here has been sold to Mondavi, I’m led to believe that the contract is coming to a close and won’t be renewed. The MacDonalds can’t use the To Kalon name on their wines currently. Detert: Today owned by Tom Garrett, a cousin of the MacDonalds. This 25-acre plot was bought in 1954, along with the MacDonald parcel – divided between the buyers’ children giving the two plots today. There’s more Cabernet Franc in this section. Most of the fruit is sold to Mondavi (with the contract, as for MacDonald, coming to an end soon), and Detert can’t use the To Kalon name on their wines. The Vineyard House: Many dispute whether or not this is original To Kalon; it’s on the hillside area purchased (but not planted) by Crabb in 1891. This plot is owned by Jeremy Justin Nickel, who is the son of the late Far Niente proprietor Gil Nickel. It’s thought to have first been planted with vines in 1980. The Napa Valley has many incredible vineyards, but To Kalon undoubtedly sits at the top of the tree. As the To Kalon Vineyard Company releases their latest vintage, Sophie Thorpe delves into the story of this iconic site – from its 19th century origins to the fight to use its hallowed name

The tale of To Kalon

This year sees the release of the 20th vintage of Cheval des Andes – Cheval Blanc’s operation in Mendoza. Since the team from the legendary Saint-Emilion estate embarked on the venture with Terrazas de los Andes, 25 years ago, much has changed – and this is the start of a new era for the property. What was once a working concept has taken root.  “This is the beginning of our adult life,” says Technical Director Pierre-Olivier Clouet. “We have a real identity today.” It’s taken a quarter-century for the property to shake off the uncertainty of youth and find firm footing – something that hasn’t necessarily been easy.  “We made mistakes,” Clouet confesses. Not having a historic reputation to rely on, the team at Cheval des Andes had sought out high scores, chasing points to prove their worth. But, in a still Parker-dominant era, that meant making wines with “ripe grapes, a lot of extraction, a high level of alcohol – you [had] to show the muscle to explain that you are a great wine”, explains Clouet. “For a long time, the recipe was in the cellar; nobody cared where the vines were.” Now, however, that’s all changed.  From 2011, the team started shifting focus to the vineyard, working more closely with their French counterparts and vice-versa. The arrival of Lorenzo Pasquini (now the man at the helm of Ch. d’Yquem) in 2015 was key to the transition, as Cheval des Andes started to focus on a shared vision of fine wine – one that is about freshness, balance and ageing potential, and one that defines Cheval Blanc.  Only with a few wrong turns, however, can you be sure you’re on the right path – and Clouet is clear that those first 16 years, figuring out what Cheval des Andes should and could be, has been “super important” in helping them build “something with real sincerity, real authenticity”. Most importantly, Cheval des Andes is not intended to be, nor is a copy of Cheval Blanc: “It is, in our mind, absolutely an Argentine wine,” says Clouet.  The original 31-hectare vineyard is in Las Compuertas in Luján de Cuyo, a subregion of Mendoza. It is on these clay-dominant soils at around 1,000 metres’ altitude that Pierre Lurton discovered a plot of ungrafted Malbec in 1998. Planted in 1929, the vine material pre-dates phylloxera, descended from a selection imported to Argentina in 1852 – back when the grape dominated Bordeaux. This selection is key to the DNA of Cheval des Andes and, along with the huge diurnal shift, produces Malbec that is fresh, precise, perfumed and delicately structured. For Clouet, the “true” Malbec is closer to Pinot Noir in style – more floral than fruit-led, vibrant and even ethereal.  In 2001, the team purchased an additional parcel in La Consulta in the Uco Valley, at higher altitude and with more gravel-driven soils, a cooler site that has an even more significant diurnal swing in temperature. While they once might have used only a fraction of the estate to produce the flagship wine, they have moved to using as much as they can – to create a pure expression of the entire property, declassifying only plots that don’t fit in the blend or meet their stringent quality standards.  All 50 hectares are farmed with the same philosophy as their vines in Saint-Emilion – employing extensive cover crops, trees scattered throughout the vineyard, and with the same incredible attention to detail and focus on sustainability. “We work with the same vision and the same conviction,” says Clouet. One key difference, of course, is that irrigation is essential in this part of Argentina – but, here again, they’ve changed tack over the last decade or so. Rather than traditional modern drip irrigation where necessary water would be eked out drop by drop over the season as needed (“too artificial”, Clouet tells me), they irrigate extensively over the winter to ensure the soils are replenished fully between seasons (as well as help protect ungrafted vines against phylloxera), then – on a plot by plot basis – when the vines are starting to suffer, they give the vines around 40mm of water (still via drip irrigation), over 24-48 hours, replicating a day or two of steady rainfall.  They’ve reduced the height of the canopy (the engine of the vine for sugar production), while using trees, cover crops and minimal leaf-pulling to avoid sunburn. They’ve started pruning each vine according to its vigour, and are now picking significantly earlier – as much as two months earlier than 15 years ago. With this detail in the vineyard, the challenge is simply to guide the fruit through the winery: “No mistakes is enough in the cellar,” says Clouet.  In some ways, the wine echoes Cheval Blanc. While the Saint-Emilion property blends Cabernet Franc and Merlot, Cheval des Andes focuses on Malbec and Cabernet Sauvignon – the Malbec bringing freshness and silkiness that complements the backbone of powerful Cabernet. And the Cheval Blanc style, one of restraint and precision, shines through in recent vintages of the wine – and especially the soon-to-be-released 2021. As Clouet tells me, “Our vision is absolutely delicacy, freshness, balance, ageing potential, complexity.” Unlike Cheval Blanc, however, which needs 10 years in bottle to start even hinting at its potential, Cheval des Andes offers an immediacy – something that Clouet is clear doesn’t inhibit its ability to last; the 2021, for example, can be drunk now, but will evolve over the next 25 years at least, he tells me.  Even the association with the Cheval Blanc name doesn’t make Cheval des Andes an easy sell to fine wine lovers; but that, says Clouet, is part of what makes it fun – a challenge for the team to be pushed. Even better, his team gets the chance to learn and make wine not just once a year, but twice, as well as gaining additional insight on how Cheval Blanc might adapt to climate change. But Cheval des Andes isn’t just an intellectual exercise (that is merely an added bonus), Clouet firmly believes in the potential of this site – something they’re now finally beginning to realise. Turning the page at Cheval des Andes

“It’s been an absolute pig of a year,” says Mark Gaskain. It’s September 2024 and we’re reaching the end of what has been a trying growing season across most of Europe – with seemingly never-ending rain. Fortunately, Gaskain knows that such challenges are just part of the job. He’s a farmer, born and bred, now at the helm of his family business, and responsible for growing 70 million apples a year. But in the last decade, he’s added a new strand to the business – after selling a swathe of land to none other than Champagne Taittinger in 2015. That land is now the home of Domaine Evremond – one of the most exciting English wine projects to date.  The story began almost a decade ago. Patrick McGrath – founder and CEO of Hatch Mansfield, which represents Champagne Taittinger in the UK – had been looking at adding an English sparkling wine to the company’s portfolio. It was the early 2010s, and he spied an opportunity with the burgeoning category – but Pierre-Emmanuel Taittinger suggested that, rather than taking on an existing estate, McGrath should create his own, working with Taittinger. Taittinger had embarked on a similar venture in California, creating Domaine Carneros with their US agent, Kobrand, under Pierre-Emmanuel’s uncle, Claude. Together, they decided to take the plunge.  They charged leading English wine specialist Stephen Skelton with helping them find the perfect site – determined to have chalk soils, south/southwest-facing slopes (for maximum sun exposure) at altitudes below 100 metres (with temperatures reducing by 1°C per 100m, anything above this would simply be too cold in England’s marginal climate). Kent – with easy access across to Champagne – was decided on, but it took them 18 months to find the right site. At the same time, the Gaskains were looking at selling some of their land (a foray into soft fruit had proven challenging, and were looking to get back to their core business of apples). The timing was fortuitous and the orchards at Stone Stile Farm – around the village of Chilham, southwest of Canterbury – were perfect. As Alexandre Ponnavoy (Chef de Cave for both Taittinger and Evremond) told me, if a site can grow good fruit – it’s a good indicator for its viticultural potential.  In 2015, the deal was signed and the project launched with great fanfare at Westminster Abbey. Domaine Evremond takes its name from Charles de Saint-Evremond (1614-1703), a Frenchman, essayist and early ambassador for the wines of Champagne – bringing them to the court of Charles II – who is buried in Poets’ Corner. Although Didier Pierson – a grower in Champagne – had made English wine under the Meon Hill label, Taittinger was one of the first major Champagne Houses to invest in England (Pommery had bought vineyards in Hampshire in 2014). Unsurprisingly, press coverage was extensive: the Champenois were coming to make sparkling wine on our home turf – the French naysayers set to eat their hats as the world started facing up to fine English fizz.  Evremond’s first vines went in the ground in 2017, with more added in 2020 (the team set up at the local Premier Inn to tackle the work mid-pandemic) and in 2024. The land here has a layer of alluvial clay over its chalk subsoil which is part of the Paris basin, shared with much of northern France (including Champagne). Around Canterbury, however, there’s more flint in the soil – something that Ponnavoy feels shines through in the wine, giving it a mineral, reductive character. There’s also a definite maritime influence – moderating temperatures, but also bringing ocean breezes from Whitstable, which is just six miles away. For Ponnavoy, it’s the combination of the site’s chalky soils, maritime softness and sea winds – a “contrasting climatology” – that defines the Evremond wines.   Gaskain is deeply involved in the project – his in-depth knowledge of the land an invaluable resource, knowing where potential frost pockets lie, for example, or where the soil might be overly rich for vines. He and his team manage the site day-to-day, guided by Christelle Rinvelle (Taittinger’s Vineyard Director). Currently, they have 62 hectares of vines, split between 45% Chardonnay, 45% Pinot Noir and 10% Meunier. They planted Chardonnay on areas with the thinnest topsoil, allowing its roots almost direct access to the chalky bedrock, while the Pinot Noir and Meunier sit on the more clay/gravel-rich plots.  The vines are widely spaced (5,000 vines per hectare – half the vine density Taittinger uses in Champagne) and trained higher than across the Channel, allowing for better airflow (helping manage disease pressure) and a larger canopy (to aid ripening). While herbicides have never been used on the site and there’s a concerted effort to be sustainable, Gaskain is clear on the limitations of viticulture in Kent: “Organics is madness in this climate,” he tells me – as, perhaps, 2024 proved. While the team has vine-specific sprayers, Gaskain can also draw on his team’s orchard equipment too – a boon when conditions are challenging – and spray the entire site in one (rather long) day.  They harvested tiny quantities of fruit in 2018 and 2019, with the first commercial-sized vintage coming from 2020 (conveniently the grape harvest falls neatly between that of Galas and Braeburns). Early wines were made at nearby Simpsons, and from 2020, they set up in an old concrete barn on the site – with the entire operation run on a generator. In June 2022, they broke ground on a new winery (“We were over budget four weeks after starting,” says McGrath, with a weary smile). The same company that worked on the Channel Tunnel dug out 83,000 tons of chalk (around 2,000 lorry loads) to make way for the three-storey building that stretches 20 metres below ground. Designed by Reims-based architect Giovanni Pace, the idea is for the winery to blend into the landscape – rather than stand on it. It has the capacity to cellar 1.5 million bottles – all without expending any additional energy on cooling, thanks to its natural subterranean chill.   Works were finished in time for the 2024 harvest – a relief undoubtedly for the team. There is something charmingly British, slightly ramshackle and underdog about the operation – despite the very serious money behind it (£17 million invested so far, reportedly). “Everybody’s had to muck in,” says McGrath. He might be Hatch’s CEO and one of the Evremond founders, but he’s also the first to pull on his wellies to help with harvest – and has spent more weekends in the vineyard than anyone else. Vitalie Taittinger has taken over from her father as President of Taittinger, and McGrath’s daughter India is running the commercial side of Evremond – meaning the operation really is a family business, even if it comes with some luxury, Champenois-esque swagger.  With the Taittinger association, of course, expectations are incredibly high – something McGrath is painfully aware of. Talking to Ponnavoy – who is in charge of the winemaking at both Taittinger and Evremond – there’s been something very exciting about creating a project from scratch, even if it has come with some challenges too. He argued to keep the small 2018 harvest for the property only, allowing them to follow the wines in tank over several years, and get to know the site. It was a huge cost, and delayed the first release, but something he felt was crucial.  “It was really important not to do a copy of another sparkling wine, not to produce a… ‘style’,” he says. Their goal, instead, was: “To identify the terroir, to identify the soil, to identify the climate, and reproduce all that in the bottle. To find the Evremond identity.” Inevitably, there’s a temptation to draw comparisons between Taittinger and Evremond, but the team is clear that they are totally separate projects with very different DNA.  Working with English fruit, Ponnavoy felt it was key to manage the potentially biting acidity (and the wine sees full malolactic as a result), but – for him – the greatest challenge was to avoid a bitterness that he finds common in some English wines. Managing the phenolics to avoid this was, for him, therefore essential, while he also focused particularly on the bubble texture – working to get a very fine mousse, something that he believes sets the wine apart from the competition.  In time, Evremond hopes to make 400,000 bottles a year, although there are only 120,000 of its first release. There are plans to add a vintage and rosé cuvée once the vines have matured and they’ve gotten to know the site, but for now they’re only producing the non-vintage Classic Cuvée. Now, a decade after they bought the land, Edition 1 of the Classic Cuvée is set to be released. For a début, it’s an incredible result – perhaps not surprising given the pedigree of the operation. Last year, the great and the good gathered at the ancestral home of the legendary Gordon family (of William Grant & Sons). A hearty dram was poured for the world’s foremost drinks authorities and they were asked to name the liquid within. So far, so normal in the Scotch whisky world. What happened next is quite unusual. Not one of the experts – with decades of experience and dozens of book credits to their name – could so much as hazard a guess.   The answer to the seemingly simple but dastardly question dumfounded them all. The as-yet-unidentified liquid was a single grain Scotch whisky that had slumbered in a lone Sherry butt for 53 years. Now almost jet-black in colour, the single grain had taken on incredible, rich notes of dried fruits, roasted coffee, and muscovado toffee – and it was indistinguishable from a greatly aged single malt.   The Cask Trials, which is the name given to this highly unusual liquid that left some of the finest palates awestruck and not-so-secretly hoping for a bottle in their gift bag, is just one of the panoply of independently bottled House of Hazelwood releases from the Gordon family’s private Scotch whisky archives.   Somewhat surprisingly, you won’t find a single malt among them. These rare whiskies, which have been amassed over the past 100 years by the owners of Glenfiddich and The Balvenie, were released to the public for the first time in 2022 in two, painfully scarce, collections. The Charles Gordon Collection (all priced above £3,000 per bottle and aged for at least 40 years), and the Legacy Collection (priced between £950 and £2,000 a bottle) are all well-aged blended Scotch, blended grain and blended malt whiskies that have been matured in the most novel ways.   “Bringing old, expensive and unusual blended whiskies to the market is slightly counterintuitive,” House of Hazelwood Director Jonathan Gibson – who was instrumental in creating the range – candidly tells me. “It's not overly common within the industry.”  It’s also not overly common within the industry to bottle liquids of this age and provenance with playful names such as "Blended at Birth", "Sunshine on Speyside" and "The Old Confectioner’s", in understated packaging at these price points.  The liquids are undeniably scarce (once they’re gone, there really is no more) and old (few are under 40 years of age, and the oldest tops 50 years), but they are undeniably unusual and at odds with the highly successful formulaic approach others have followed of encasing precious liquids in highly ornate, priceless vessels that weigh more than a small child.    “They're not concept releases,” Gibson explains. “Everything is driven by the whisky. The packaging is quite straightforward. It's a nice bottle and it's classically engraved but we haven’t collaborated with the hottest designer. The idea is really just to give the whisky room, provide a platform, without overshadowing it,” he adds.   “Over the past 10-15 years – and it's no bad thing at all – you can see a lot more old age-statement single malts coming onto the market,” Gibson says, “And typically they're very straightforward in terms of their naming. It's distillery name, plus age statement equals a certain financial value.  “The naming of these releases is slightly playful, but actually if you look at them one by one, they're very straightforward. It's not quite a Ronseal, ‘it does exactly what it says on the tin’ approach, but it's not too far away from that. If you said ‘Blended at Birth’, it could be seen as quite playful but it's also quite descriptive and the same for ‘The First Drop’ and ‘Sunshine on Speyside’,” he explains.   It's clear Gibson, who has been involved in the project since the start, has genuine affection for the whiskies and the stories each one has to tell. He and the team are custodians of historical artefacts that the Gordon family have not parted with for the best part of a century.  “The First Drop”, for example, is named as such because it is the first liquid to run from the stills at the Gordon family’s Girvan grain distillery on Christmas day in 1964. This is the first and last time it can be purchased. “There's a real emotional tie from the family to these whiskies,” Gibson explains. “For the current family members, it's their dad who laid down these whiskies and he's not around anymore.  “I think it's actually quite difficult for the family to let some of these whiskies go, even though there's a begrudging acceptance that they can't drink such quantities and it was time they cut the cord and let these whiskies go out into the world.”  “There's a general principle that we're following where the whisky is ready to go when it's ready,” Gibson explains, “so we're not chasing down a 60-year-old age statement just so that we can put a big 60 on the bottle.”   It has been a pleasant surprise for all those involved to witness the reception the House of Hazelwood whiskies have received from an occasionally prickly and vocal audience.    “Sunshine on Speyside had an amazing response and it's one of the least expensive whiskies within our range,” Gibson says delightedly.   “It was selected because of its character and its flavour, and named because it has this amazing mango/ pineapple popsicle fruit character that transports you to sunshine and the Caribbean. It's one of those ones where everyone instantly agreed that it had to go into the first collection.   “I thought that everyone would be drawn to the oldest whisky at tastings but actually, this whisky captured the imagination of a lot of the writers and the trade.”   It’s hard to emphasise quite how unusual these whiskies are, as most releases – old or new – are described in hyperbolic terms.   “Blended at Birth”, which was released as part of the first collection, is a blend of malt and grain whisky that was married and matured as new-make spirit. Today, it is against the Scotch Whisky Regulations’ technical file to produce a whisky in this way, as you now have to age the malt and grain whisky components for a minimum of three years separately before blending them, so any liquids of this ilk on the market are painfully scarce.   “Unusual” and “esoteric” aren’t always necessarily loaded with positive connotations – you might take a sip of said liquid, politely smile and then return to something slightly less unusual and more palatable – but these whiskies have incredible balance and depth of flavour, in part because they are blends and not single malt whiskies.    “These old grains in particular are just unbelievable in terms of the flavour,” Gibson says with unfettered joy. “At a younger age, grain whisky is quite neutral in character but once you're past 30 years, if it's aged well, grain whisky has a luscious, delicious quality which adds so much to the final profile of the Scotch.    “The variation in style is enormous,” he continues. “I thought I understood old grain whisky but on exploring the inventory further you see these amazing grains that you didn't really know you could get.”   These whiskies wouldn’t have existed if it wasn’t for the foresight of the Gordon family  – and two brothers, in particular, who changed the company’s stars during the mid-20th century. The young Charles and Sandy Gordon brought much-needed vim and vigour to what could be a bit of a staid industry in the late 1950s. The pair famously refused to kowtow to demands from their grain whisky supplier – instead pulling the contract and setting up their own grain distillery, Girvan, in the 1960s. Charles – or Charlie as he was known – even forwent the comfort of his own home and instead lived in a caravan on-site during the build, riding a bicycle to stealthily check on the workers’ progress. His unconventional methods clearly paid off as the sizeable distillery (which still stands today) was built in a record nine-month period.  During their tenure, the duo also interrogated every aspect of whisky-making from distillation to maturation, resulting in the bold decision to employ an on-site coppersmith and cooper – which are still in situ at many of the William Grant distilleries today – to give the family more control. They were a formidable pair and the business arguably wouldn’t have survived some of the challenging periods in Scotch whisky’s history had it not been for their fortitude.     “There's something about family ownership that means you have a bit more luxury to maybe indulge some of your creative whims,” Gibson says with a wry smile. “This independence enabled them to explore ideas that might have been hard for others to justify to their board of shareholders.”  When other producers would have been forced to make very difficult decisions in order to survive those darker years, the larger, independent William Grant would have been slightly more insulated. Out of curiosity alone, they would have been able to hold on to barrels of maturing liquid and see how they developed over time.  These are the barrels that the House of Hazelwood team – and by extension us – now have access to. Each one has an incredible story – and an even better depth of flavour. The Thienponts reign over Bordeaux’s Right Bank. At Vieux Château Certan, Alexandre Thienpont – almost always dressed in his Barbour – rules, producing Pomerol of immaculate pedigree, as his family has for over a century now. Nearby, cousin Jacques Thienpont holds court at Le Pin, Pomerol’s original cult address. Nicolas Thienpont is another cousin whose domain stretches out from Saint-Emilion – from Pavie Macquin and Larcis Ducasse across to several estates in the Côte des Francs. And the dynasty continues to grow, as each thread of this complex family finds a new corner of the region to master.  The Flemish family has a long history in the world of wine, having traded French wine (especially Bordeaux) since 1842. Georges Thienpont – grandfather of Jacques, Alexandre and Nicolas) was the first to move into production, buying Ch. Troplong Mondot in 1921, then Vieux Château Certan in 1924. It wasn’t long before the Great Depression hit, however, and Georges Thienpont was forced to sell Troplong Mondot in 1934. Reportedly the only reason he kept Vieux Château Certan was that no one wanted to buy it – with vines holding little allure at the time. It was the château itself at Troplong Mondot, positioned at the highest point in the region and with a view across the village of Saint-Emilion, that allowed him to sell the Saint-Emilion estate. Georges continued to make wine through the Second World War and the devastating frost of 1956. Despite a challenging start, “VCC” (as it is affectionately known by wine-lovers) has become one of Bordeaux’s leading names.  It was Jacques Thienpont, however, who thrust the family firmly into the limelight. It was in 1979 that Jacques, then still a Belgian wine merchant, purchased a 1.6-hectare vineyard in Pomerol. The site had produced generic Pomerol, but Jacques started making tiny volumes of opulently styled wine, naming it after the lone pine tree (“le pin”) that stood on the property. The 1982 vintage was pivotal, receiving significant critical acclaim – especially from Robert Parker – and soon Le Pin became one of the world’s most desirable wines.  Just over 30 years after that first vineyard purchase, it seemed like fate when Jacques went to see a plot of land in Saint-Emilion right next to Troplong Mondot. Previously known as Ch. Haut-Plantey, the potential of the site was clear to Jacques and the symmetry of the Thienponts returning to where their family’s winemaking legacy began seemed fitting. He bought the property in 2010 and put Cyrille Thienpont (his cousin once removed) in charge of its daily running. In keeping with the arboreal theme, he named the Saint-Emilion venture L’If (the yew tree).  The first project the team undertook was a detailed soil map to get to grips with the site. The winery is in Saint-Laurent-des-Combes, just to the east of Troplong Mondot, with five hectares of vineyard around it and another two hectares of west-facing vines next to Saint-Hippolyte. The lower parcels are more eroded and sandier, but much of the vineyard sits on pure limestone and clay. They set about restructuring the vineyard – getting rid of the 5% Cabernet Sauvignon and increasing the portion of Cabernet Franc, with around 25% across the property today (any new plantings were with a massal selection from Pavie Macquin).  In 2013, Jacques bought another hectare or so of vines in Saint-Etienne-de-Lisse, right next to Ch. Puy-Blanquet. Despite the quality of the soils, Jacques was hesitant about buying such a “distant” plot, a whopping three kilometres as the crow flies – or a circa 10-minute drive. They pulled the vines out and replanted this additional parcel, harvesting its first fruit in 2018. Despite its youth, the fruit from the plot has made it into the final blend for every vintage of L’If since 2020 (“Worth the trip,” jokes Cyrille). Even with the significant replanting and this new plot, the average age of vines across the estate is around 40 – with the oldest over 60 years in age.  Work on a new winery finished just in time for the 2023 harvest, allowing greater precision and flexibility – with more space to work (and 16 concrete tanks for their eight hectares of vines). You might expect a flashy building, perhaps designed by a famous architect – but that’s not the Thienpont way. Understatement is everything for this family – and the winery is an almost exact replica of what stood there before, simply with more space inside, designed for simple functionality. In one corner stands an otherwise anonymous stainless-steel tank – the first one that Jacques bought for Le Pin back in 1979.  It was perhaps inevitable that L’If would sit in Le Pin’s shadow. But now, 15 years after Jacques Thienpont bought the estate, with a new winery and the significant work in the vineyards completed, L’If is building its own reputation.  Although the same team is largely involved in both estates, L’If is a totally different site and wine. The cool soils have better water-holding capacity, and budburst is around 10 days later than at Le Pin with its warm free-draining gravels – a gap that often widens as the growing season progresses, meaning harvest is significantly later here. Diana Berrouet Garcia – who acts as Managing Director for Domaines Jacques Thienpont, including both Le Pin and L’If – notes how at L’If the terroir seems to speak louder than the vintage and can better adapt to more challenging conditions, while the vines can struggle – especially in hot, dry years – at Le Pin. Where Le Pin is round, supple and exotic, L’If is linear, taut and mineral; one sensual and spherical, the other just on the right side of severe, with a crystalline quality. Even in the last few years, it’s amazing how the wine is evolving – nipping at Le Pin’s toes in terms of quality. Re-tasting the 2019, it’s amazingly approachable with a perfumed nose and juicy, pure fruit that complements the wine’s natural tension.   It's still comparatively early days for L’If –  and the team has invested significantly, focusing on shaping the vineyard and ensuring they have the tools in the winery to translate the work in the vines. For now, over half the vineyard is being used for the second wine, Les Collines d’If – something that will change in time, as they continue to replant parcels. As it happens, yews grow incredibly slowly – but are also some of the longest-living trees (Perthshire in Scotland is home to the Fortingall yew, thought to be 2,000-3,000 years old and one of the oldest trees in Europe). The Theinpont family is just settling in at L’If, but as they lay down roots, the potential is clear.   The Thienpont family: who does what?  Jacques Thienpont: Owns Le Pin, L’If and L’Hêtre (the latter with his sister Anne de Raeymaeker), but is also a co-owner of Vieux Château Certan. He oversees the family’s original Belgian wine merchant business, the Belgian Royal Warrant-holding Thienpont Wine, which is managed by his wife and award-winning wine writer Fiona Morrison MW.  Alexandre Thienpont: Co-owns and manages Vieux Château Certan with his son, Guillaume, as well as co-owning Le Pin with Jacques. Alexandre and Guillaume also farm the vines at Le Pin, L’If and L’Hêtre, as well as Vieux Château Certan.  Guillaume Thienpont: Manages Vieux Château Certan with his father, Alexandre, as well as making L’Etoile and Les Fillottes with his second cousin, François Thienpont. He also now manages Ch. Guillot-Clauzel, which is not owned by the family.  François Thienpont: Manages the family’s négociant business, Wings, as well as making L’Etoile and Les Fillottes with Guillaume Thienpont and is a co-owner of both Vieux Château Certan and Ch. When a red blend from Chile became the first wine from outside Bordeaux to be offered on La Place in 1998, it no doubt ruffled a few feathers. Could the New World, let alone South America, ever rival the quality of wines being made in Bordeaux? In the late 1990s, the answer was frankly no. Today, however, the fine wine market is keeping its eye on Chile’s leading estates with good reason. Not because they can rival Bordeaux in style, but because Chile’s winemakers are defining a style all of their own and discovering the potential of their top terroirs.  Gone are the days of overripe fruit, heavy-handed oak and 15% alcohol wines which dominated the scene during the height of Robert Parker’s influence in the early 2000s. Today vintners are focusing on making chiselled and elegant reds, as a result of much earlier harvesting and more restraint in the cellar – but, most importantly, these wines are all about balancing the freshness and nuance of their mountain terrains with the vibrant fruit profile and fine tannins these sunny lands offer. In the past decade, thousands of soil pits have been dug across Chile’s wine regions as winemakers get under the skin of their Chilean DNA — an endeavour well worth the effort as recent vintages show. Here are the regions at the forefront today.  Alto Maipo  It’s no coincidence that Château Mouton Rothschild’s Chilean venture with Concha y Toro, Almaviva in Alto Maipo, was the first non-Bordeaux wine to reach La Place. Maipo had been at the heart of Chile’s great Bordeaux imitation game since the 19th century, and on paper, Alto Maipo has a lot in common with Bordeaux: the same red varieties planted on similar gravels of river terraces.    Today, however, the best wines – including Almaviva and Viñedo Chadwick – focus on what makes Alto Maipo Cabernet Sauvignon and blends distinctive. In high-altitude Puente Alto in particular, the purity of the Andean sunlight at over 700 metres’ altitude offers a flamboyance of cassis and blackcurrant aromas, while cool mountain nights revive the grapes, giving the wines tension, filigree tannins and fragrant wild herb aromas. It’s this seductive combination which marks Alto Maipo as a Grand Cru of Chile.  Aconcagua  Further north, the Chadwick family has been making bold wines from valley floor vineyards in the warm Mediterranean climate of Aconcagua for over a century. Since the 1990s, however, they have been planting on the slopes and the more interesting colluvial soils found in the Andes foothills and towards the coastal mountain range.  Their iconic Seña blend, which originated as a collaboration with Robert Mondavi in 1995, has become increasingly refined under the hand of Chilean winemaker Francisco Beattig in recent vintages. Select plots of mainly Cabernet Sauvignon and Malbec are synthesised into a balanced wine of 13.5% which prioritises harmony over power and carries graphite, cedar and blackberry aromas, trademarks of contemporary Aconcagua wines.  Apalta  One of Chile’s few DOs reflecting a place rather than a political region, the hill of Apalta has become world-renowned as one of the country’s best terroirs, with some of the best-known estates in Chile. Lapostolle, the biodynamic estate of the Bournet Lapostolle family, has been instrumental in developing the reputation and character of Apalta wines.  The key to Apalta today, and their iconic Clos Apalta property is the unique microclimate and kaleidoscopic palate of profiles the winemaker can draw from on this diverse hill site in Colchagua – from rich old-vine Cabernet Sauvignon on the clay soils of the valley floor, to the linear Merlot and peppery Carménère from Apalta’s southeast-facing granite slopes. These complex blends with black cherry and black pepper aromas, a full body and silky finish have become highly sought-after trademarks of Apalta wines today.  Chile’s winemakers are increasingly site-specific in their quest to show the potential of their unique country, with new and exciting vineyards being planted from the limestone-encrusted soils on the coast of the Atacama Desert down to the volcanic slopes of Osorno in Chilean Patagonia. And while there are no doubt many more Grands Crus in the making in Chile, those that have risen to the fore in the fine wine market today show precision, focus and a far greater self-understanding and appreciation than ever before.  Explore all current Chilean wine listings or read more Editorial

In March this year, Opus One announced that they’d hired Meghan Zobeck as Director of Winemaking. It’s the first step in the transition as longtime winemaker Michael Silacci looks to step away from the business over the next five years. Silacci has been at Opus since 2001 and is a bonafide legend in the valley today – finding a suitable successor is no small task.  Zobeck wasn’t necessarily the obvious choice. She’s risen rapidly through the ranks of Napa’s winemaking elite – but only moved into the world of wine in 2012. That move was a leap of faith for Zobeck – an unlikely one for someone immersed in the world of NFL.  Zobeck grew up in Greeley, Colorado – “a cowtown” in her words, but one that happened to be where the Denver Broncos held their training camps each year. Throughout high school, she spent her summers working for the team – as many locals did. She went off to college (then pre-med), but kept working for the Broncos, moving to full-time while she studied for her MCATs.  In her senior year of college, she did an internship with the team, working with the scouts and sitting in the “war room” on draft day. “I loved the action, the fast pace of it,” she says. At around the same time, she realised that medicine wasn’t for her – instead she took a role negotiating player contracts for the Broncos, becoming one of only a handful of women in the job, and loved it.   It was a weekend trip to Los Olivos in the Santa Ynez Valley that sparked her interest in wine and – more specifically – winemaking. Back home, she found an ad in a local magazine for a homebrew shop – offering the chance to buy grapes during harvest. Soon she was experimenting, fermenting batches of wine in her basement and having bottling parties with friends. “I just saw how it really brought people together,” she says. She travelled to more wine regions and fell for the way wine combined science, creativity, history and community. The NFL had served her well, but it was time to take that leap and leave the Broncos behind.  She did her first vintage at Clos Apalta in 2012, and didn’t look back – doing harvests in Piedmont, Bordeaux and the Barossa, before zoning in on Napa – first at Stag’s Leap Wine Cellars and Screaming Eagle, then taking a job with star consultant Philippe Melka. Most recently, Zobeck was winemaker at Burgess Cellars – where she had free rein to shape the wines, from the vineyard through to the winery.  Zobeck first met Michael Silacci at Premiere Napa Valley – her first showing barrel samples from Burgess. Silacci came over to taste and then – in a clear display of approval – kept sending others her way. Zobeck was focusing on a fresher style of wine, a return to the Burgess of yesteryear, but was also working towards a regenerative approach in the vineyard – and soon discovered that the Opus One team was doing similar experiments. She and Kimberlee Marinelli – Assistant Winemaker & Viticulturist at Opus One – connected and started discussing everything from pollinators to native ferments. Zobeck was struck by the clear lack of complacency from a property that had no need to prove itself further. Little did she know that Silacci was observing what she was doing with particular interest – and decided she could be the heir to his throne.  “It’s a job you never, in a million years, think is going to become available,” says Zobeck of the moment she was approached about becoming Opus One’s Director of Winemaking. There was no way she was turning down such an opportunity – especially not when she would have the chance to work with Silacci for several years.  Zobeck will take on Silacci’s legacy at Opus One – an estate that has been constantly evolving during his tenure. Organic farming has been the norm at Opus for over two decades, although they only sought certification in 2021. For over a decade, Silacci trialled biodynamics but found the vines became too vigorous. He abandoned the approach before launching into regenerative farming from 2022. The estate now works with permanent cover crop between the vines, helping lower temperatures in the canopies, retain water in the soils and lengthen the ripening period, without increasing sugar levels. Silacci has been experimenting with dry farming since 2007 and reducing irrigation across the estate, although it remains essential for now. The team hopes, however, to be able to dry-farm a new site in Oakville once the vines are established. This work is all reflected in the wines being produced today.  “Opus One is not the stereotypical Napa of the early 2000s,” Zobeck emphasises. “It’s a fresh style, and to keep that we have to farm differently.” Silacci is famous for saying he doesn’t want his footprints in the vineyard or fingerprints on the glass, but Zobeck notes how you can see his influence on Opus One over the years, especially from 2004. From 2019, however, she feels the wine has evolved further – with greater transparency of the site. The 2023 has just been bottled at a modest 13.5% alcohol – indicative of the estate’s current approach, one that she intends to continue.  Silacci plans to stay for at least three years, working alongside Zobeck as Chief Winemaker. A transition period of this length is testament to Opus One’s long-term view – looking not just at the next vintage, but the next decade and beyond. Zobeck’s excitement for the role is clear – as well as her admiration for the existing team. As in the NFL, a good captain is key, but it takes more than one player to win a game – and Zobeck completes an already impressive line-up. It’s one hell of a hand-off. Dalmore, Mortlach and Macallan fetch tens of thousands of pounds at auction today – but they likely wouldn’t exist if it wasn’t for an independent bottler. In times of great economic hardship, Gordon & MacPhail provided cash-strapped distilleries with much-needed capital when they secured new-make spirit to mature and bottle as a single malt, rather than a blend. “The world was so focused on blends in the 1970s that to get the financial return on the malts was really challenging,” Gordon & MacPhail’s Director of Prestige Stephen Rankin says. To put that into perspective, a bottle of 35-year-old Macallan from 1937 that would fetch approximately £32,000 in today’s market would sell for a mere £4.54 then. A top-end blend might sell for £2. Rankin says if it wasn’t for his forebears’ patience and foresight, 50-, 60-, and 70-year-old bottlings wouldn’t be available today. “It’s not just matching spirit with oak,” he explains. “It’s actually matching the spirit with the oak and then time and the patience.”   The Gordon & MacPhail name has endured where countless others have not. Today, the fourth generation can pull out samples dating back nine decades from more than 100 distilleries. “It’s that lineage that stands us apart,” Rankin says. “As a company we have had this incredible respect for whisky and depth of relationships forged from 1895.”   “Business was done on the strength of a handshake when my father started the company in the 1940s,” Fred Hamilton Laing – Douglas Laing & Co Chairman and second-generation family member – says. “And so many of our filling programmes still continue today because there was a trust given and a confidence that there would be no abuse of the stock.” If it wasn’t for the “fairly substantial” stocks Laing’s father had built up since the 1950s then the Scottish independent blenders and bottlers might not have survived the 1990s financial crash in Asia Pacific. “All of a sudden our blended business was made very difficult to continue. We were constantly adding to our stocks of grain and malt whisky for these blends, so it was a survival instinct that took us into the single cask business in the year 2000.” This business proved to be “very good” and steadied the ship. Laing says it was with great delight the company was able to come back into the blending business with Big Peat in 2009, much to the dismay of the “crusty old men in the industry”. This launch, looking at younger, slightly more rebellious whisky consumers heralded a new era for the company and brought them full circle. It was the filling programme’s breadth of stock and the relationships with the distilleries that allowed Douglas Laing to carry out the same process for Big Peat and Scallywag into the Scottish Highlands for Timorous Beastie, into the Lowlands with the Epicurean, into the Campbeltown area with the Gauldrons, onto the Island distilleries with Rock Island and introduce the Remarkable Regional Malts. “It’s a busy game,” Laing adds.  Fledgling in comparison, That Boutique-y Whisky Company stormed onto the independent bottling scene in 2012 with their 50cl illustrated bottles. “We are all about throwing fun back into whisky,” Head of Whisky Sam Simmons says. “We take the whisky very seriously, but we don’t take ourselves seriously.” The goal here is simple: curate delicious whiskies you would never see from an official bottling. This disruptive attitude has led to a cult-like following which Simmons readily acknowledges “doesn’t speak to everybody”. The Boutique-y whiskies might originate from around the world, but they are all bottled in the Scottish tradition – bought direct from the distiller or from brokers and other independent bottlers. The retail price is always calculated from the cost of the liquid rather than market value or cost. “The kind of whiskies we want to bottle may not be delicious to everybody, but they are the kind of whiskies that make you say: you got to try this,” Simmons adds. When it comes to bottling exquisite liquids, few ventures are as compelling as “curators of the most remarkable spirits”, The Last Drop Distillers. “I really love the word remarkable,” Managing Director Rebecca Jago says with a smile. “Because it is not saying it is the oldest or the best even, but that it is intrinsically delicious. If I gave you a glass of something from The Last Drop, I would want you to find it as delightful as someone who has been nosing spirits for 50 years.” The company started by Rebecca’s father Tom and his long-term friend James Espey OBE in 2008 is somewhat unique in that it crosses category. The two drinks industry icons initially set out to bottle single malts, but that all changed when they tasted a certain 47-year-old blended Scotch. From that day onwards, the two men – who had previously developed the likes of Johnnie Walker Blue Label and Chivas 18 – broadened their brief to seek out exceptional old parcels of any amazing spirit. By the time the company was sold to Sazerac in 2016, The Last Drop had released seven remarkable liquids and both Espey and Jago’s daughters (Beanie Geraedts-Espey and Rebecca Jago) had joined the business. In addition to being a source of great pride for the two founders, the acquisition also brought new freedoms and opportunities for the team. The US drinks group backing enabled The Last Drop to source stock for immediate release, granted them a greater ability to lay down stock and create their own libraries of future stock, and gave them the opportunity to venture into liquid creation. “I think finding treasure is not just about uncovering it,” Jago says. “It would be disingenuous to suggest that we’re Indiana Jones in Scotland, going and hunting out that barrel that is hidden at the back of the cellar because it is not,” Jago says. As romantic as the image might be, every single barrel of Scotch whisky of any age, of any sort, is known about by HMRC.  “We can talk about some of the lovely discoveries that we have genuinely been party to,” Jago adds. “Going back to the very first release of three unassuming barrels of an old blend. The treasure in that was the liquid inside. It had perhaps been discounted or forgotten about.” Or the “genuine discovery” of a Cognac barrel that had been lying untouched in an outhouse for over 70 years that was happened upon by a family member doing renovation work at the distillery. “I think that is the sort of ultimate Indiana Jones story,” Jago adds, “not by us, but we were fortunate enough to be there and I suppose our story of making the liquid the hero is sufficiently compelling that they are prepared to let us put it in a bottle.” All four bottlers, whether in their infancy or maturity, are bound by a sense of honour and wanting to do right by the liquid. And everyone benefits.   Browse all Scotch whisky or read more Editorial
