Every now and then, the word ‘singularity’ is used to describe a particular wine that stands apart, for whatever reason, from other wines of its type. But just what is singularity, and how can wine express it? Wine writer Tamlyn Currin investigates.

What is Krug?  Krug is one of the most famous Champagne Houses in the world. It is unusual for making only prestige cuvées and is prized by fine wine lovers, seen by many as the pinnacle of fine Champagne – competing with the likes of Cristal and Dom Pérignon.  When was Krug first made?  Joseph Krug established Krug & Compagnie in 1843 with a wine merchant friend, Hyppolyte de Vivès. Born in Mainz in 1800, Johann-Joseph Krug was the son of a butcher. He dropped the Johann, moved to Paris in 1834 and worked as a bookkeeper at Champagne Jacquesson before starting to blend his first wines with De Vivès, trials for what would eventually become the Krug project.  Is Krug still owned by the Krug family?  No – although the family is still very much involved.  When Joseph passed away in 1866, his son Paul took over the business. In 1868 he moved the business to 5 Rue Coquebert in Reims, the address still occupied by Krug today and home to its historic cellars. The company passed to Paul’s son Joseph II in 1910, but his wife Jeanne took the reins when Joseph II became a prisoner of war during the First World War. Joseph II’s nephew Jean Seydoux became a joint manager after the war, with the business passing to Paul Krug II (Joseph II’s son) in 1959 and then to Henri and Rémi Krug, who joined the company in the 1960s and took over in 1977.  Brothers Henri and Rémi were pivotal in developing the House – expanding the range, building its international reputation and overseeing its sale to luxury goods conglomerate LVMH in 1999. Although they continued to manage the House, the financial backing of LVMH only allowed Krug to thrive. In 2009, Olivier Krug – the sixth generation of his family – took over as Director of the House and remains at the helm today.  What is the Krug style?  Often quite deep golden in colour, Krug is renowned for its use of oak, choosing to ferment all its base wines in old 205-litre oak barrels, allowing micro-oxygenation. This, combined with long lees ageing (minimum six years for non-vintage and 10 for vintage wines), produces a powerful, broad and richly autolytic style of wine, layered with bread, biscuit and brioche notes. The huge number of blending components used for Grande Cuvée makes a particularly complex non-vintage – or as they prefer to call it, multi-vintage – wine. The House also favours picking on the earlier side to retain freshness in the wines. Dosage here is average with the wines labelled Brut, and dosage normally sitting around 5-6g/l in modern releases.  It's interesting to note that Krug feels Meunier is an important element in their blends (sometimes viewed as a lesser grape by Champagne Houses), valuing the mid-palate generosity it brings to wines. Meunier often represents 15-25% of the House’s vintage blends.   What are the different Krug wines?  Joseph Krug had clear ideas about how to make the best Champagne and famously outlined these in his burgundy-coloured leather notebook (which is on display at the Krug family headquarters today). He declared that the House would only make two cuvées, intended to be of equal quality. Cuvée No 1 was a non-vintage wine, conceived to be “the fullest expression of Champagne every year” (embodied today by Grande Cuvée), while Cuvée No 2 would express each vintage. He also firmly believed in the importance of site, writing, “We cannot obtain good wines without using good elements and good terroirs.”  For many years, the House continued to produce just two wines, but the range has since expanded. Although the non-vintage and vintage wines were intended to be equal in quality, the vintage wines command higher prices today.  The Krug range consists of six wines:  Krug Grande Cuvée: Grande Cuvée is Krug’s flagship non-vintage, or multi-vintage (MV), wine, and the modern Cuvée No 1, and previously known as Private Cuvée (until 1978, see below for more on this). There are up to 200 components in each bottling of the wine, combining over 10 vintages (the youngest six years old, the oldest over 20 years old). While it is the House’s “entry-level” offering today, the House holds back many of its best wines from top vintages for the wine. It spends minimum seven years’ ageing on lees prior to disgorgement, with an additional year on cork prior to release. Unlike many non-vintage wines, the goal is not for the wine to be entirely consistent between releases, but to make “the fullest expression of Champagne”. From 2011, this was acknowledged officially when Krug added the Krug ID to every bottle (see more below). In 2016, the House took this further and decided to add an Edition number to each release, starting with Edition 163 (for which the base year was 2007). Some collectors seek out particular editions of Grande Cuvée, with 164 (base 2008) or 168 (base 2012) unsurprisingly lauded. Half-bottles don’t have the edition number on the label, so you need to use the Krug ID to identify the specific bottling.  Krug Rosé: The House’s other non-vintage wine, Krug Rosé was created by Henri and Rémi Krug in the 1970s, with the first release based on the 1976 vintage, released in 1983. The wine is a blend of white wines, with around 11% still red Pinot Noir blended in, combining anything between 20 and 70 different components from five vintages, spending minimum six years on its lees. As for Grande Cuvée, in 2016 Krug added an Edition number to the Rosé label, starting with Edition 21 (base 2008).   Krug Clos du Mesnil: Clos du Mesnil is a single-vineyard vintage Blanc de Blancs Champagne, and one of Krug’s top wines. Champagne expert Richard Juhlin describes it as “the best wine in the world”. Henri and Rémi Krug purchased six hectares of Chardonnay in Le Mesnil-sur-Oger in 1971 and when they went to inspect the vineyards they discovered it included a walled 1.84-hectare plot in the heart of the village. On the wall is inscribed, “In the year 1698, this wall was built by Claude Jannin and Pierre Dehée Metoen and in the same year the vines were planted by Gaspard Jannin, son of Claude.” They replanted the site and at first the fruit was blended into the House’s other wines, however they found that the warmer microclimate – surrounded by buildings – produced a distinctive wine, and they decided to bottle it separately. The first vintage was 1979, released in 1986 – at a time when a single variety, single site wine was pioneering. Aged for minimum a decade on its lees, it is only made in certain vintages where the quality allows.  To date, the vintages of Clos du Mesnil produced are: 1979, 1980, 1981, 1982, 1983, 1985, 1986, 1988, 1989, 1990, 1992, 1995, 1996, 1998, 2000, 2002, 2003, 2004, 2006, 2008 and 2009.  Krug Clos d’Ambonnay: Pure Pinot Noir from a single 0.68-hectare plot, Clos d’Ambonnay is Krug’s other single-vineyard vintage wine. Henri and Rémi found this site on the edge of the village of Ambonnay, on the southeastern slope of the Montagne de Reims, in 1991, managing to purchase it in 1994. Like Clos du Mesnil, the site is a walled vineyard, with the walls dating back to 1766, although vines weren’t planted until the 20th century. The first vintage of the Blanc de Noirs was produced in 1995 and released in 2007. As with Clos du Mesnil, it sees long lees ageing (minimum a decade) and is only made where vintage conditions allow. Given the size of the vineyard, Clos d’Ambonnay is particularly rare.  To date, the vintages produced of Clos d’Ambonnay are: 1995, 1996, 1998, 2000, 2002, 2006 and 2008.  Krug Clos d’Ambonnay Rosé: The first vintage of Krug’s Clos d’Ambonnay Rosé is set to be released in autumn 2025, the 2008 vintage. The first new cuvée since the House launched Clos d’Ambonnay, the wine is a rosé from the same single vineyard, including 15% still red wine in the blend.  Krug Vintage: The other wine conceived by founder Joseph Krug, Cuvée No 2, was a vintage wine that the House still produces today. It is only made in vintages deemed worthy by the House and spends over 10 years on its lees prior to disgorgement.  Recent vintages produced of Krug vintage are: 1988, 1995, 1996, 1998, 2000, 2002, 2003, 2004, 2006, 2008 and 2011.  Krug Collection: In the 1980s, Krug introduced its Collection – a late-disgorged release of more mature wines, normally offered around 25 years after the vintage. These wines have been kept in the House’s cellars, ageing in perfect conditions. Releases to date include: 1981, 1982, 1985, 1988, 1989, 1990 and 1995.  What is Private Cuvée?  Private Cuvée was the previous name for Grande Cuvée, the House’s non-vintage wine, labelled as such from 1862 to 1978. Champagne expert Richard Juhlin notes that the style shifted with the name change, with Grande Cuvée a little lighter more Chardonnay-driven and more multi-faceted, however Private Cuvée was closer to a vintage wine in style with more weight. “The style from the 20’s to the 60’s is strikingly constant and if you find a bottle with a good level and with a price tag you can handle, it is a chance you must not miss,” he writes of Private Cuvée.  How much Krug Champagne is made?  Production for the House is kept firmly under wraps, however estimates suggest around 425,000 bottles are made each year.  What is Krug ID?  This six-digit code features on the back label of every bottle of Krug and allows the drinker to find out about their specific bottle of, with the first three digits indicating the quarter and year of disgorgement. You can look up the ID on the House’s website or app to find the blend, oldest and youngest wines, tasting notes, food and music pairing suggestions. The Krug ID was introduced in 2011, so only appears on bottles released after that date.  Does Krug own vineyards?  Krug’s expertise was historically winemaking and blending, and always operated as a négociant, as was the norm for the Grandes Marques in Champagne. Krug bought fruit from carefully selected sites to make their wines, but Henri and Rémi purchased the House’s first vineyards in 1971 – including the now famous Clos du Mesnil.  Today Krug owns 21 hectares of vines, representing around 20% of their production, supplementing this with purchased fruit. Krug sources its Chardonnay, Pinot Noir and Meunier from the villages of Ambonnay, Aÿ, Le Mesnil-sur-Oger and Trépail. All their contracts are for specific parcels, many based on generations-long relationships, with their oldest contract dating back to 1876.  Krug has been increasingly focused on sustainability, not using any herbicides or pesticides in its own vineyards and the estate vineyards are certified organic as of the 2024 vintage.  Who makes Krug?  As with any winery, there is a large team involved in producing Krug – including the growers supplying fruit and those in the winery at Krug. Eric Lebel was the longtime cellarmaster, from 1999 to 2019, handing over to Julie Cavil who worked alongside Lebel for 13 years before taking the reins at the start of 2020.  When it comes to deciding on the blends, there is a tasting committee, led by Cavil and usually with Olivier Krug. The committee meets every day between the end of harvest and March, tasting 15 samples each day (a strict maximum to ensure their judgement isn’t impacted by palate fatigue). Over the period, they aim to taste all 400 samples two or three times in total. Each taster has to describe each sample with just a single word, which cannot be duplicated by any other taster – something that Cavil feels helps give a better overall picture of the wines.  How is Krug made?  As already mentioned, all Krug’s base wines are fermented in old oak. They use 205-litre barrels, averaging 20 years in age, often retired at around 40 years. They do not block malolactic fermentation but do not encourage it, so some wines do go through malolactic fermentation. Post fermentation, the wines are transferred to stainless steel tank (they are not aged in wood, as at Henri Giraud, for example). The blends are decided by the House’s Tasting Committee (led by Cellar Master Julie Cavil) between the end of harvest and April, before being bottled and spending minimum seven years on their lees (10 years for the vintage wines).  Where is Krug made?  For almost two centuries, the wines were made at Krug’s historic premises in Reims, however as of 2024 the winemaking has moved to its new Joseph winery, just next to Clos d’Ambonnay.   What’s the deal with Krug and Burning Man?  Krug caused some controversy when it shot a marketing campaign at the Burning Man festival at Black Rock in Nevada in 2011. The shoot and brand were denounced by the Burning Man organisation for not complying with its principles, commercialising the festival and community.  Why is Krug’s bottle shaped differently?  Krug’s distinctive narrow-necked bottle was introduced in 1978, at the same time as it changed the name of Private Cuvée to Grande Cuvée. The House previously used standard Champagne bottles. Beyond making Krug’s bottles even more distinctive, the narrow neck is intended to reduce oxygen exchange over the ageing process.  How does Krug age?  Krug is renowned for its ageing potential – with all the House’s wines, including the non-vintage cuvées, designed to evolve in bottle. Champagne expert Essi Avellan MW notes: “All Krugs benefit from ageing. Five years after release, they tend to have opened up beautifully, showing more expression and a beautifully harmonious nature. Grand Cuvées are a real delight some 10 to 15 years after release, often at the peak of their expression. The vintages are all long-lived; thereafter it depends on the vintage (and the individual bottle, of course) as to how they age. Arvine: Switzerland’s hidden treasure Berry colour: white
 Arvine, pearl of the Alps The ultimate Swiss grape variety, Arvine can produce captivating, complex wines of international stature, from dry to sweet. It is native to the Valais, southern Switzerland, where it was mentioned for the first time in 1602. Since the late 19th century, it has often been called Petite Arvine to distinguish it from Grosse Arvine, a completely different and rare local variety. I have not so far been able to uncover Arvine’s parents by DNA testing. It is often said that Arvine was introduced to Switzerland by the Romans. Its name allegedly derived from helvola, a grape variety mentioned by Cato the Elder. I refute this claim for two very simple reasons: firstly, it is impossible to establish botanical identity between the vague descriptions of Latin authors and modern varieties, and secondly, helvola grapes were black-berried. I think instead that its name comes from the local dialect arvena, itself probably derived from the Latin advena, meaning ‘just arrived’. This name could have been given to the variety shortly after its birth (or arrival?) in the Valais. It is a late-ripening variety, with small berries and compact, small bunches. It is quite productive, but prone to wind damage and susceptible to fungal diseases. Arvine covers 218 hectares (539 acres), almost exclusively in the Valais, representing only 1.48% of the country’s vine-bearing area. It produces complex, lively wines that can age well, with aromas of citrus and rhubarb, and a firm structure, as well as a characteristic salinity on the finish. Champions of Arvine In the Valais, several outstanding producers make excellent varietal Arvine wines. For dry wines, I would recommend Cave Benoît Dorsaz in Fully, Valentina Andrei in Saillon, Didier Joris in Chamoson, Cave de l’Orpailleur in Uvrier and Domaine des Muses in Granges, among many others. For the sweet wines, produced from grapes that are naturally left to shrivel on the vine, the undisputed champion is Marie-Thérèse Chappaz in Fully. From her biodynamic vineyards, this icon of Swiss winegrowers crafts some of the best sweet wines in the world, especially from Arvine. Her Petite Arvine Grain Noble is highly sought after, and her otherworldly Arvine Grain par Grain, made exclusively from botrytised berries harvested by hand, berry by berry, is almost impossible to find. Arvine has rarely been planted outside Switzerland. In Italy, it was introduced to the neighbouring Aosta Valley in 1970. In 1992, Angelo Gaja, one of Italy’s most famous wine producers, planted 0.36 hectares in Serralunga (Piedmonte). The result was a disaster, in his words, mainly because of problems with coulure and wind damage. In France, some vine parcels exist in the Languedoc and in the Rhône Valley, where charismatic winemaker Michel Chapoutier planted half a hectare in Tain-l’Hermitage, but he was not convinced by the results and has now abandoned the experiment. Outside Europe, it is produced only in Mendocino, California, by one adventurous producer, Ernest Vineyards, which makes a varietal wine under the Edaphos label.

Areni: Armenia’s national treasure Berry colour: BLACK 
History in a bottle Areni is the most important red variety in Armenia. It most likely comes from the village of Areni in Vayots Dzor, at the southeastern end of the county, where the world’s oldest cellar (4000 BC) was discovered in a cave in 2011. Interestingly, the grape remains found at the bottom of the old karas (the traditional clay jars) buried in the cave look very similar to the pips of the modern Areni variety. DNA profiling has failed to identify Areni’s parents, making it an orphan Armenian variety, but it has shown that at least two distinct varieties share the name Areni: Areni Sev (sev means black), the ‘true’ one that has historically been grown in Vayots Dzor, and Areni Seyrak (seyrak means loose, referring to the bunches), sporadically found among Areni Sev vines in old mixed vineyards. Areni Sev is a late-ripening variety with oblong, sometimes ovate, thick-skinned berries. The bunches are medium-sized and dense. It shows good resistance to frost, which means it can be cultivated at high elevations (up to 1,600 metres in Armenia). It is moderately resistant to powdery mildew and susceptible to downy mildew. Areni is exclusively cultivated in Armenia, where it has traditionally been used to make high-quality, age-worthy wines with complex aromas of violets, wisteria, cherries and blackberries, silky tannins and refreshing acidity. Champions of Areni After my first visit to Areni village in 2003, and despite the rudimentary winemaking at the only local winery (Areni Winery, now Hin Winery), I was convinced that Areni was among the most promising grape varieties in the world. In 2012, I met Zorik Gharibian in Izmir (Turkey) at the European Wine Bloggers’ Conference. I was much impressed by his 2010 Karasi Areni Noir, Zorah Wines’ very first vintage after 10 years of trial and error. We became friends and I selfishly helped him find an importer in Switzerland, in order to secure my own supply of his wines, including the mind-blowing high-end cuvée Yeraz. Since then, Zorik and his wife Yeraz have relentlessly promoted Armenian wines all over the world, and Zorah Wines has become one of Armenia’s most respected flagships. Their wines, sourced from ungrafted vineyards between 1,300 and 1,600 metres altitude are partly made in karas, traditional clay jars partly buried underground, ‘cousins’ of the Georgian qvevri. The sad thing is that Armenian-born Eduardo Eurnekian, one of the wealthiest people in Argentina and owner of several airports, including that of Yerevan in Armenia, has founded a winery named Karas Wines, despite not using any karas in the winemaking process. In 2018, judges granted him the exclusive usage of the name Karas, disregarding 6,000 years of shared tradition. Zorik Gharibian has been determinedly fighting against this unfair judgement and he plans to appeal to the country’s Supreme Court. I strongly support him. And I predict that Armenia may well be the ‘next big thing’ in the wine world. Dr José Vouillamoz
 Kydonitsa: Rebirth of an extremely rare grape variety Berry colour: WHITE Rescued in the nick of time Kydonitsa is a survivor, an almost forgotten variety from Lakonía (Laconia) in the southern Pelopónnisos (Peloponnese) in Greece. According to local belief, it was widely cultivated in the medieval period when Lakonía formed part of the Byzantine Empire. It then flourished under brief periods of Venetian rule, before it was threatened with extinction under Ottoman rule, as a result of the bans on alcohol consumption. It had almost disappeared when it was saved from extinction by Yiannis Vatistas and Yorgos Tsimbidi (Monemvasia Winery) in the late 1990s. DNA profiling has not revealed any match or parentage with any other variety, making it a Greek orphan. The medium-sized bunches are relatively loose and elongated. The berries are small and turn golden yellow when ripe. In Greek, the word kυδωνίτσα (kydonitsa) means ‘little quince’, referring to the aroma of both the berry and the wine. The wine also shows notes of lemon, grapefruit, bergamot and mirabelle plum, as well as aromatic herbs. It is elegant, creamy, with crisp acidity and a slightly bitter, orange-peel finish, with a hint of iodine. Kydonitsa is grown exclusively in Lakonía, on the east coast of the Pelopónnisos, near the island of Monemvasia. Champions of Kydonitsa Yorgos Tsimbidi is a visionary. In 1997, while most wineries in the Pelopónnisos were busy planting so-called international grape varieties, he founded Monemvasia Winery in order to revive the historical Malvasia wine in its birthplace. The name Malvasia has been given to a wide range of genetically distinct white-, pink-, grey- and black-skinned varieties which are all particularly well suited to the production of sweet wines. The name is purported to be a corruption of Monemvasia, which means ‘single entrance’ and is the name of a small port situated on a rocky spur in Lakonía. It has been famous since ancient times for its sweet wine made from sun-dried grapes. The earliest mention of the sweet wines of Monemvasia dates back to 1214 in Éfesos (Ephesus, today in Turkey), and in 1278 the Venetians were already importing vinum de Malvasias. The exact identities of the grape varieties making up this sweet wine are still unknown, but Kydonitsa and the appropriately named Monemvasia were probably part of the blend. This is what drove Yorgos Tsimbidi to put all his time and energy into rescuing them, carrying out countless on-farm trials since 1997. He now produces dry varietal wines, as well as the sweet ‘Monemvasia – Malvasia’, a blend of Monemvasia, Kydonitsa, Assyrtiko and Asproudi grapes, dried for approximately two weeks under the sun, in order to revive the ancient tradition. Today, Yorgos runs the winery with his wife Elli and their daughters Marialena, Anastasia and Artemis. I was able to taste a mini-vertical of Kydonitsa during my visit in 2016, which convinced me of the exceptional quality and ageing potential of this resurrected variety. And the rest of the portfolio convinced me that Monemvasia Winery is one of the best in mainland Greece. Dr José Vouillamoz

 Baga: Northern Portuguese red with a simple name and a complex character Berry colour: black 
The rehabilitation of Baga The meaning of Baga may be simple (berry) but the variety is far from it. When it is good, it is breathtakingly beautiful and capable of long ageing. When it is abused, it is acid, mean and lean, with tough tannins. It requires commitment from growers and wine lovers. While it may have originated in Portugal's Dão region, it has found its home in neighbouring Bairrada, where it is the dominant red variety. In 2017 there were 8,258 hectares (20,406 acres), 4% of Portugal’s vineyard area. It’s found mainly in Bairrada but also in Dão, although there it is not authorised in DOP wines. Baga vines are also planted, though far less numerously, in Lisboa, the Tejo and the Douro. The cool, wet, Atlantic-influenced climate of Bairrada is particularly inconvenient for a late-ripening variety with thin skins and prone to botrytis. If its vigour and productivity are not controlled by careful viticulture or the natural balance achieved by older vines in poor soils, there is increased risk of under-ripeness or rot when the September rains arrive. Despite all this, those whose hearts have been captured by the variety have shown it to be as bewitching as Pinot Noir, and as hauntingly complex and long-lived as Nebbiolo. Champions of Baga The variety allows itself to be made in many styles, influenced strongly by the soil (limestone-clay and granite are both prized), the age of the vines and, not least, by the personalities of the winegrowers and their choices in the winery. The most restlessly experimental and determined is Luís Pato, who was prominent among a small group of quality-minded winegrowers who dragged Baga into the spotlight for fine wine after it had languished for so long as a source of bulk reds churned out by the state-controlled co-ops and négociants for much of the 20th century. While there are today, thankfully, too many good winegrowers to mention by name, the Baga Friends display the variety’s wonderful diversity: from the powerful styles aged in oak that become increasingly complex and perfumed with age that are produced by, for example, Luís Pato, Mário Sérgio Alves Nuno at Quinta das Bageiras, François Chasans at Quinta da Vacariça and Paulo Sousa at Sidónio de Sousa; to the lightly stepping, red-fruited, fresh and scented beauties of Filipa Pato and Douro incomer Dirk Niepoort at Quinta de Baixo. Baga can also make very good sparkling wines. Bussaco Palace Hotel has an astonishing collection of very old vintages, blending Baga from Bairrada with Touriga Nacional from Dão. Julia Harding MW 
Kisi: Recently resurrected and scented Georgian white Berry colour: WHITE The resurrection of Kisi Maybe it’s because thin-skinned Kisi is difficult to grow and sensitive to the climate that it was on the verge of extinction at the end of the 20th century, when David Maisuradze made a wine that put the variety firmly back in the spotlight. The highly respected winemaker, then with Telavi Wine Cellar, managed to find just four tonnes of the variety to make a wine, fermented in a stainless-steel tank, that stunned wine lovers with its pure, floral aromas and deep fruit flavours of citrus and pear, richly fruited but dry. This variety didn’t stand much chance in the Soviet era when only a very limited number of varieties were permitted in the interests of volume rather than quality. Kisi was not among them and it survived in family vineyards in just three villages in its homeland of Kakheti, in the Alazani Valley in eastern Georgia in the shadow of the Caucasus Mountains: mainly in Maghraani but also in Argokhi and Pichkhovani. There are currently about 500 hectares (1,235 acres) of Kisi in Georgia, all still in this region. There is currently no DNA evidence to reveal the variety’s parentage but it is not related to Mtsvane Kakhuri or Rkatsiteli, the latter a Soviet favourite. Champions of Kisi In Georgia, ‘classic’ white wines are made in a way familiar to most 21st-century wine drinkers – fermented without the skins, typically in temperature-controlled tanks, occasionally fermented or aged in oak. By contrast, so-called qvevri white wines, sometimes referred to as amber wines because of their typically deep colour, are those vinified in traditional Georgian qvevri, large clay vessels ranging from 700 to 2,000 litres, buried underground so that just the opening is visible. The lightly crushed whole berries, including the skins and seeds, and sometimes even the stems, are fermented together in a qvevri, thus producing a wine with firm, even chewy, tannic texture and a wonderful panoply of flavours derived both from the variety and the winemaking, often ranging from apricots to chamomile. Soon after the appearance of Maisuradze’s revelatory wine, Gogi Dakishvili, a master of these qvevri wines, was able to buy a small amount of Kisi and make a wine in this second style. The cat was out of the bag and growers, including Dakishvili, started to replant when they saw the potential.  Kisi made under both the Dakishvili Family and the Orgo labels reveal all the textural and aromatic complexity of scented varieties made in this way. They are utterly pure, full-bodied wines with intense aromas and flavours that have sufficient structure to be very versatile with food. Qvevri winemaking was recognised as a UNESCO intangible heritage in 2013. While this is the style I particularly enjoy, for anyone who is not a fan of amber wines, there are fine examples that reveal even more of Kisi’s aromatic potential and deep but fresh fruit intensity. These include those from Winiveria and Khareba, and a particularly good off-dry style from Koncho & Co. One of the finest, in this case with light oak influence, is made by Danieli Winery, from vines near Argokhi, one of the three villages which were key to Kisi’s renaissance. Julia Harding MW

Alphonse Gros was the first in his family to settle in Vosne-Romanée, in 1830, and purchased the monopole Clos des Réas, still worked by the family today. His son Louis-Gustave took over the business and bought more vineyards. He married and – by the mid-19th century – the wines were bottled under their combined name, as Domaine Gros-Guenaud. In 1882, he purchased two hectares of Richebourg – vineyard land that remains under the Gros family today. Louis-Gustave’s son, Jules Gros, inherited the business from his father and, similarly to his father, labelled the wines under his and his wife’s name, as Domaine Gros-Renaudot. In 1920, he purchased two parcels of Clos Vougeot, later adding Les Grands Echezeaux and three hectares of Echézeaux, in the lieu-dit Les Loächausses.  Louis Gros, Jules’s son, took over in due course, and bottled wines under Domaine Louis Gros and later Domaine Louis Gros & Fils. He passed away in 1951, leaving four children: Jean, François, Gustave and Colette, who continued running the family estate until 1963, when they divvied up the property.  Gustave and Colette joined their shares together to create Domaine Gros Frère & Soeur.  Jean and François worked together, making wine under the name Gros Père & Fils, but divided their holdings in the early 1970s. Jean established his own estate, Domaine Jean Gros.  François continued to produce wine under the Gros Père & Fils label (négoce bottlings), but also under Domaine François Gros. In 1978, he stopped bottling wine due to health problems, and for a decade all the wine was sold to a négociant, with both the domaine or négoce ceasing production. Despite previously studying the arts, his daughter Anne Gros shifted too winemaking and revived the family domaine in 1988, under the name Domaine Anne & François Gros, changing this to Domaine Anne Gros in 1995.  Jean had three children: Bernard, Michel and Anne-Françoise. Bernard Gros took over Domaine Gros Frère & Soeur, while Michel Gros starting making wine under his own name at Domaine Michel Gros. Anne-Françoise established Domaine A.-F. Gros (she later married François Parent of Pommard, who brought family vines with him to the operation). The next generation is now taking over, and even setting up their own estates – with Anne Gros’s son Paul Tollot-Gros having made his first handful of vintages under his own name.    The Gros estates today  Domaine Gros Frère & Soeur: Bernard Gros has now handed the running of this domaine over to his son, Vincent Gros.  Domaine Michel Gros: Michel Gros is still at the helm of this estate, although his son Pierre is now working alongside his father.  Domaine A.-F. Gros: This estate, with a large winery in Beaune as well as a property in Pommard, is now run by brother-and-sister Caroline and Mathias Parent, with Caroline in charge of the commercial side of the business and Mathias running the vineyards and winery.  Domaine Anne Gros: Anne Gros is still in charge at the estate, but her children – Julie, Paul and Marine – are all involved. Paul has now also set up his own label (see below). She also has a project in the Minervois, under the name Jean-Paul Tollot & Anne Gros  Paul Tollot-Gros: Anne Gros’s son, Paul Tollot-Gros, set up his own label as of the 2022 vintage.

Untangling the Gros family’s estates in Burgundy

 When the UK entered the first coronavirus lockdown in March 2020, there was a sense that the end of long, thoughtful, funny and serious conversations was dangerously close. Over a Zoom call, sat at our respective kitchen tables, F+R’s Patrick O’Connor, creative director Alan Aboud and myself, a journalist and editor, started to wonder if we could work together in some way to explore topics usually explored at the communal tables that were sadly empty.  The first project we worked on together marked the 90th birthday of iconic Lebanese winemaker Chateau Musar and the simultaneous publishing of a book celebrating the winery by Académie du Vin Library. Working together with music consultant Leo Walton, we conceived a package of content for FINE+RARE’s website to coincide with F+R’s exclusive release of various mixed cases of Chateau Musar vintages going back to the 1960s.  As part of the content package, I wrote three articles for the F+R website, and worked with Leo to create four Spotify playlists featuring Lebanese music from the relevant decades of the Musar vintages being released: the 1960s, 1970s, 2000s and 2010s. Leo and I also suggested the potential to add more cultural context to both the wine and our selection of music by producing a podcast in which we interviewed a Lebanese musician about musical culture and heritage in the region. We explored various ideas before interviewing two members of the Beirut Groove Collective – a group of DJs with a reputation for unearthing records from the 1960s, 70s and 80s and giving them a new audience. We asked the DJs to give us the low down on their legendary all-night vinyl-only parties in Lebanon’s capital, and about Beirut’s surprisingly vibrant music scene throughout the Civil War (1975-1990). We also asked Ernesto about his new reissue project with BBE Records and the first release in the series: Ihsan Al-Munzer’s 1979 synth-led Belly Dance Disco album.  This idea – of creating original editorial content that proactively ventured into topics in and adjacent to the worlds of fine wine and spirits in order to enrich the FINE+RARE experience – immediately appealed to all involved. Between us, we started to flesh out the idea for a new content platform that could explore and commission stories that took advantage of our combined knowledge, skillsets and networks, plus FINE+RARE’s access to the best producers and most interesting personalities driving quality in the worlds of fine wine and exceptional spirits.  While the concept was always for FONDATA to be a multi-media platform whereby we would produce content in whatever medium seemed most relevant to a given subject matter – podcast, video, blog or print – we focused our initial efforts on producing a large-format, print journal. It would provide a brilliant canvas for us to commission the best writers, photographers and illustrators, and it would also be the perfect format to function as a physical mission statement, something we could send to F+R customers. Doing this in 2020, when we were in lockdown, seemed like a great way to maintain connection and morale in an unprecedented moment in living memory. We formed a small ‘bubble’ to sit, appropriately distanced, in Patrick’s back garden in Hackney to brainstorm the idea and start mapping out what stories we could potentially commission for our first FONDATA journal. For the inaugural issue, one story in particular was pivotal to realising our ambition: commissioning American essayist, author and regular contributor to The New Yorker, Adam Gopnik to write a piece for us. In his book, Paris to the Moon (Quercus, 2000), Gopnik likens Jean-Philippe Derenne’s L’Amateur de Cuisine book (Éditions Stock, 1996) to “a medieval almanac, offering a timeless, secure, benevolent universe of food.” In our initial conversations, we’d identified Wine Grapes, A complete guide to 1,368 vine varieties, including their origins and flavours (Allen Lane, 2012) – the weighty 1,240-page tome authored by Jancis Robinson MW, Julia Harding MW and Dr José Vouillamoz – as a book we’d love to celebrate in some way. We wondered if Gopnik would be as enamoured with the book as much as Derenne’s and if he’d write something for us about it and its value to wine lovers and gastronomes alike. We duly sent him a copy of Wine Grapes (clothbound and slipcased) and a note introducing ourselves and outlining FONDATA’s ambition. He loved the book and the idea for the piece, so we contacted Jancis to ask if she would be happy to be interviewed by Adam. It turned out they were both fans of each other’s work. Our first feature was underway. But how would we present the piece? What would FONDATA look like? Alan asked Jancis if she would agree to be our cover star for our first issue. When she agreed, we had to work out how to bring the inaugural cover to life. “Gavin Bond popped into my head,” Alan, recalls, of the task at hand, “as he has become the ‘go-to’ photographer for celebrity portraits, especially in the film and fashion business. I felt Jancis deserved that status and reverence. Of course, the wine world reveres her, but no wine journal seems to be able to look beyond a shoot involving wine bottles and grapes.”   With Gavin Bond on board, the next step was to think about the shoot itself. “We enlisted the help of a wonderful floral design company, Studio Lupine,” Alan explains of his art direction. “We briefed Raggie Furuseth, the designer, to create a wildly original space in which Jancis could be photographed. The resulting portrait is a stunning and sensitive study of one of the world’s most learned and charming wine writers in her prime.” Another crucial part of our first issue planning was around design concepting and setting out our production values. As a kind of guiding light, Alan and I had adopted a mantra: “This isn’t a magazine”, as FONDATA would have none of the concerns of a regular magazine. We didn’t want to print on flimsy paper. We didn’t want to create something predictable or ephemeral, but rather an object that felt it had more permanence, more lasting value. FONDATA, we were all very clear, would strive from the outset to be a joyous, opulent celebration of cerebral, long-form editorial content.  Alan began working with his studio designer, Haley Austin, exploring different oversized formats, experimenting with page layouts and type treatments to realise his vision for how FONDATA would look. At the same time, he commissioned Rick Banks of Foundry 37 to create a bespoke logotype for FONDATA’s masthead based on his F37 Caslon typeface. We also adopted F37 as our core typeface for body copy, and to use at large scale for feature headlines and beautiful, full-page pull quotes.  In terms of our editorial direction, we were keen from the offset to commission editorial that explored evergreen (and ever-fascinating) topics. What does it mean to collect? How has the pandemic affected our lifestyles, and how much of that is positive? How do ideas germinate, and how does genius emerge? How important is history and tradition to innovation and revolution? What are the most significant drivers and the biggest hurdles for excellence? Once the Gopnik feature was in the proverbial bag, we set to work commissioning an issue full of features that we hoped would appeal to a wine-loving audience but not feel like we were trying to sell them something.  We approached Jancis Robinson’s co-authors of Wine Grapes, Julia Harding MW and Dr José Vouillamoz, to call out five relatively obscure grape varieties from around the world to champion them and the producers making remarkable wines with them. We also commissioned botanical artist Sarah Jane Humphrey to illustrate each variety.  We asked the former director of London’s Design Museum, Deyan Sudjic OBE, to contemplate the history of social spaces. To accompany his feature, we asked him to approach a number of highly regarded architects and interior designers to illustrate their visions of social spaces of the near future. As a result, we soon added John Pawson, AB Rogers, Paloma Strelitz, and Jon Marshall to our list of contributors. We tasked journalist and author Dylan Jones OBE with critiquing wine’s critical landscape, connecting him with some of the world’s leading wine writers and critics to discover how the pandemic had reshaped their work lives and lifestyles.  Author and historian (and one of the most elegantly dressed gentlemen about town) Nicholas Foulkes very literally wrote the book on cigars. His son, Max, is a Master of Havana and works at Davidoff in Mayfair. And it was Nicholas’ father-in-law who first introduced him to the pleasures of cigar smoking. Especially for our first issue, Nicholas pondered the joy of his relationship with his sons and the idea of passing cultural knowledge and enthusiasms from one generation to the next. We commissioned Julian Broad to shoot a portrait of Nicholas with his sons.  I spent time talking with restaurateur-turned winegrower Alex Xu and wrote a piece about how he’d come to completely reshape his future by planting three hectares of Pinot Noir and Chardonnay vines in the foothills of the Jade Dragon Snow Mountain in China’s most idyllic province. I also interviewed Waterford distillery owner Mark Reynier to find out how (and why) he’s bringing notions of terroir, traceability and transparency to the fore in the world of single malt whisky.   Meanwhile, British chef and food writer Thom Eagle contemplated the value of spending more, rather than less, time in the kitchen, and artist Stewart Walton illustrated the piece.  We commissioned educator and business guru Germana Di Falco to interview fashion designer Brunello Cucinelli about his philosophy to business and life itself, and we engaged British-born, LA-based writer and critic Geoff Dyer to chart the slow journey towards appreciation of and reverence for well-chosen wine. The issue signs off with a Letter from California penned by winemaker Maya Dalla Valle, who reflects on her 11-year journey to become the winemaker at her family’s celebrated vineyard in Napa. The resulting inaugural issue is everything we hoped it would be. As Patrick says in his publisher’s letter on its very first page, it is a celebration. One that delivers rich, engaging editorial content in a format that feels lavish and collectable in and of itself. “It is also a collective,” he continues. “The best minds brought together to tackle the subjects that captivate, so arresting in their absence – experience, space, people and family. [This issue] became a journey into the sound of the things that matter to the soul of the collector, the reasons things exist, the FONDATA.”

FONDATA: The genesis story

Wine, though the most intimate of pleasures, lends itself to the most expansive of texts. We drink wine most often – tastings aside – in pairings of two, or in lonesome but agreeable solitude, and, its narcotic pleasure being felt internally, we feel its effects as we feel a fever: almost secretly, in shivers. Though wine is like sex in its intimacy, unlike sex, the form in which we fetishise wine – our vine erotica – is not hushed and illicit but encyclopedic. On the shelves of any wine drinker, there are likely to be catalogues, dictionaries organised by region, old Parker buying guides some 600 pages long that somehow, though dated, can’t be discarded.  Wine seems singular among human pleasures in this. We don’t, as a rule, rush from reading a poem to great anthologies of poetry, or add to the savour of seeing a play by reading a big atlas of dramatic literature – not, at least, after we graduate from school. Sports fans, it’s true, like big books of statistics, but then sports-watching is a social act in the first instance – the more people in the stands, the merrier the occasion. With wine, we like the macro with our micro: with a solitary glass in hand, we look, in print, over the next hill, or the current vintage, at the vineyard across the way, or the vintage yet to come. It’s part of the pleasure the glass provides. The reasons for this micro and macro turn are, on reflection, commercial and artisanal as much as aesthetic. The business of wine needs a big picture of its domain, its resources, and its potential market – scale sets the stage for commerce. The makers of wine like to place themselves on a broader map of where wine is and what it’s made with. The great Bordeaux classification of 1855 is not just the noblest public monument to a beverage ever attempted, but a model of market-making and even market price-fixing. Once a hierarchy of growths has been established, it is easy to slot in the price tags. But there is a truth of taste beneath the ordering of value. With wine, we know that what we are experiencing is, however singular, still an intersection of opposed forces – as the peerless wine writer Jancis Robinson MW says of her first glass of Chambolle-Musigny 1959; “I knew at once that there was something in the glass that was sensually delicious but that it was also made, produced, and therefore suggested a history of intellect and discernment.” The pleasure of wine is the crossing of a place, a grape and a people; and so, we turn to the big books to frame the small pleasures.  What distinguishes wine from even a good glass of ale or a local brew is the specificity of the pleasure set against the scale of the system that made it – one that historically embraces the planet. It’s a First Growth, or a domaine Burgundy, or a Ridge Zinfandel or a New Zealand Pinot Noir made to a Burgundy model by American wine makers … the more we know, the more we’re free to feel. Most sensory pleasures are specific to the point of being illicit – aside from the bemused fetishist, romance is a spontaneous pleasure, often aided, to be sure, by a systematic wine. Wine is premeditated; we choose a bottle, let it ripen, and break it open. Even casual table drinking has a tale to tell, a journey to trace on a map. These thoughts are brought to mind in contemplation of Wine Grapes, the monosyllabically titled but unprecedentedly expansive dictionary of grape varieties grown to be crushed and fermented on this green planet. Authored by Robinson, along with Julia Harding MW and the geneticist Dr José Vouillamoz, it marks an epoch – several epochs – in our understanding of wine, from both a professional planet-straddling and an amateur glass-in-hand perspective. A book of its time (published in 2012), it was made possible, in part, by a revolution in the DNA analysis of wine grapes to help discover their origins and histories.  The DNA profiling of wine grapes only began in 1993, and the first ‘paternity test’ successfully concluded in 1997 – a mere few days ago by historical perspective – with specialists, Dr Vouillamoz among them, drawing astonishing Darwinian lines among seemingly unrelated grapes. Zinfandel, it has been discovered in the last 40 years, is not only the Siamese twin of Primitivo, but its Croatian Siamese twin. In proper Darwinian fashion, the book tells us, “It looks increasingly as though an enormous proportion of the grapes we know today are members of a few key families.”  The leading families of wine, Pinot and Nebbiolo and the rest, like the leading houses of Westeros, jostle and engage in incestuous inter-breeding as they move towards dominance. As Jancis Robinson admits, the quest for the origins of grapes can become surprisingly emotional. “The Zin quest is so … heated. There was a Zinfandel conference in Croatia, with all the great Zin makers, even Joel ‘King of Zin’ Peterson from Ravenswood, and we all had to present our various things about Zinfandel. There was a small cohort of people from Montenegro who reckoned that their variety – whose name is unpronounceable – was the true progenitor of modern Zinfandel, not the Croatian one. It became so … Balkan! And you know what? They may be right!” Wine Grapes is of its time in another sense as well, marking the moment when we have started to think of wine not solely in terms of region, but much more in terms of variety, with the semi-mystical term ‘terroir’ acting as a kind of Holy Spirit between them. Thinking ‘grape’ more than ‘place’ releases our imaginations. The wholesome instructive pleasures of the book, to which we’ll come, shrink beside the unwholesome, guilty pleasures of turning the pages to meet the failures among grapes – the near-misses, the long-forgotten and forlorn lost toys – which please more than the patterns of primacy. The pleasure of reading about the grapes whose juice we do drink is nothing compared to reading about those we don’t. In dictionaries, oddities and parentheses fascinate us more than the major entries. No one turns to the dictionary to study ‘and’; we go to study ‘antediluvian’. So, turning these pages, flipping through the P’s on our way to encounter the great Pinot families, we come upon the lesser gods, even the little misshapen gnomes and dwarves of the wine world, and we delight in meeting them. (A fascination added to by the forthright sub-heads the editors provide.) On our way to Burgundy and Pinot Noir, we also meet Pinotin, a ‘recent obscure Swiss hybrid’ which edges into Pionnier, ‘a minor but complex, cold-hardy American hybrid used in blends in Québec’, and, of course, Pinotage ‘South Africa’s very own cross, both loved and despised’, which leads us on to Pugnitello and even Pukhliakovsky (a Russian variety ‘with erratic yields producing light wines’) and even unto Pules – ‘a minor Albanian white’. Radiating out from five pages on the major Merlot, we bump into Merseguera, ‘an uninspiring variety’ from Spain, and Merzifon Karasi, and Merzling, dismissed as a ‘very minor disease-resistant German hybrid’. Why these lost or obscure kinds of grapes bring so much delight with them is a fascinating question. It has in part to do with our general appetite for oddities and obscurities, which once produced ‘freak shows’ and still makes us fascinated with archaic musical instruments: we are curious to hear the sackbut because we want to know what led to the trombone. It is also the virtuous case that variety is the safeguard of continuity. In an age of ever-decreasing biodiversity with just a few varieties taking the place of many possibilities, one Quixotic California winemaker, driving through the fields of Cabernet and Chardonnay, dismissed them all – with a wave of the hand – as “chocolate and vanilla, chocolate and vanilla”.  The health of the planet is safeguarded by the persistence of so many kinds. It is also because the existence of these minor yet still thriving varieties gives us a satisfying picture of adaptation, the central biological act. Each of these grapes has found a home in the world. It may not be much of a home, but then neither, face the facts, is ours. We identify with the unknown grape. We are all more like a very minor disease-resistant German, or a cold-hardy Québec hybrid, than we are something noble and complicated. Few of us are bottles of Burgundy; we can all identify as minor Albanian whites. In conversation, Jancis Robinson, sheltering at home near Kings Cross in London, a home with a view of a graveyard (though a cheerful one she assures an interviewer) – talks of the wine almanac with the blunt enthusiasm that marks her writing. Robinson, in addition to her obvious honours and credentials, is a rare thing in the wine world, or any world: a writer who writes with equal parts brio and expertise. She explains the origins of Wine Grapes. “What happened was that one of the co-authors, Dr José Vouillamoz, who had been at University of California, Davis, felt that he needed to earn more of a living, and came back to Switzerland and got a job working on Alpine botanicals. But he didn’t want to lose his relationship with wine, and he came to me and said that he’d like to collaborate on a book about grape varieties. I’d already written one in 1986, based on our very fractional knowledge then.  Over lunch, I took along Julia Harding, a wine writer who works on my website. She’s extremely punctilious.” (Robinson, punctilious herself, says this with such emphasis that the listener feels that, with Harding, we must be talking about new frontiers, not to say dimensions, in punctiliousness.) “She had exactly the right sort of brain for a project like this. José suggested that we focus on the 10 or 12 most planted grape varieties to help simplify it. I thought that that book didn’t sound interesting enough. I waited until we were quite far down a bottle of Valpolicella and said, ‘I think our book should be about every single grape variety we can find.’ He gulped and said, ‘Then that’s what we shall do!’” The idea of creating a ‘perfect map’ of a subject is one of the itches that govern modern life. John James Audubon set out to describe not the major but every bird and beast in North America, and that’s what he did. Similar ‘almanacs of everything’ fill our botanical and anthropological shelves. It is an ambition so tied to modernity that in the mid-19th century, Lewis Carroll perfectly satirised it in his novel, Sylvie & Bruno, where two mad professors talk about their dream of making a map that would be on a one-to-one relation to the actual world – utterly perfect, if impossible to unroll. “I loved the scale of the thing,” Robinson says of her perfect map. “So, we carved things up: José did all the DNA stuff and history because he had good access to it, Julia, bless her, did the footwork – how much of each grape is planted where – while trying to taste as many as possible, too! And I wrote the entries on the best-known varieties, and the introduction and read every single word.  As with any dictionary, we used what came before: we went through appellation lists, with all of the varieties allowed, some of them almost extinct. A nice little detail of the book is that we persuaded the publisher that it should have some colour plates, and we were particularly keen to include the plates from the world’s first oenological book, L’Ampélographie: Traité Général de Viticulture, of 1901 … just out of copyright!” She pauses. “Of course,” she adds reflectively, “it was José, naturally, who discovered that Pinot and Syrah are related.” The offhand nature of her mention can’t conceal the significance of the remark. Of all the discoveries offered in the book, this is perhaps, for the amateur wine drinker, the most exemplary and astonishing. Painstakingly tracing the DNA heritage of the varieties, these two noble houses, Syrah and Pinot – the grapes of the Rhône Valley and those of Burgundy, the heart of Côte-Rôtie and the soul of Chambertin – are unified as cousins. This happened not through willed cultivation but in the natural evolutionary way: through variation and adaptation. Initially, the elegance of Pinot Noir was transformed through the usual evolutionary pressures of place and mutations, into the earthy pleasures of Syrah.  Chance mutation and lucky planting turned one grape into its near opposite. (‘Cross-fertilisation’, we’re told, ‘was common until the early 20th century because several grape varieties were often intermixed in the vineyards, facilitating natural crossings between distinct grape varieties’.) The phylloxera epidemic in France from the 1860s on – though it did not destroy as much as is sometimes thought – acted as a kind of sieve or filter of grape varieties, a sort of extinction event in large-scale natural history, forcing hard choices and making obscure varieties less desirable to save by root grafting with New World vines.   One virtue of the book is to propose, in effect, a new order of wines by celebrating ‘secondary’ grape varieties. “For me, among the obscure wines, something about as well-known as Cinsault stands out – it can make such lovely wines,” Robinson says. “There’s been such a sea change as the century turned. Everybody once wanted to make fruit bombs to one of three standard recipes. Then in this century, higher acidity, lighter wines are finally revaluing, and so Cinsault comes into its own. “Sometimes I come across a grape that isn’t well known but that’s so obviously superior. There’s Aglianico – the name suggests it’s Greek, though no Greek variety has ever been found and you only get it in Southern Italy. Perfect for late ripeness, and not for cool climates – and now it has travelled to Australia, where they’re desperate for hot weather varieties.  The whole array of Portuguese and Greek grape varieties are so fantastic! And so individual. And I love that after a dalliance with international varieties, both countries are now celebrating their own. There’s another white grape, an Iberian variety that’s stunning, and, again, I’m not sure it’s yet been planted much: Godello! It’s a bit crass to say it makes wines that taste like Montrachet, if a little more terroir-y and mineral … but it does. I could drink Cinsault for red and Godello for white into the next century. “There’s such a gap nowadays,” Robinson goes on, “between the Napa Cab thing, and these young people who are buying unknown grape varieties that sell for a fraction of the price, that are really good. Such a lot has happened in the field of recuperating old vines, some so obscure that they don’t even have a name. Miguel Torres, the scion of that great company in northeast Spain became very interested in grapes.  At first, he said, ‘Hey Dad, we need the posh varieties, Cabernet and Chardonnay’ – and made all these wines which did well in the Judgement of Paris. But, with time, he realised that it made more sense to concentrate on the indigenous varieties. He’s been engaged for 30 years, putting classified ads in the local press – ‘If you know of a wine grape that you can’t identify, let us know of it, and – if we think we can propagate out – we’ll do micro-vinification.’ He’s actually rescued Catalan varieties that were on the brink of disappearing; I think he found 30 varieties, and recuperated eight for micro-vinification with sufficient character to give them a new lease of life. And much the same thing has been happening all over Italy. If we published the book today, we’d be up to at least 1,500 kinds of grapes.” The great sorting question of our time, of course, is the question of climate change and its effects on wine cultivation. Robinson is cautiously hopeful about Burgundy. “I was lucky enough to go there and spend some time. The 2020 harvest is the earliest ever, at least since the 14th century. But, whereas the 2003 vintage, that legendary hot summer in France, produced wines that were pretty bizarre, the 2019s seem as fresh as a daisy, with pure fruit. I’m no plant biologist, but the vines seem to be getting used to the conditions … or the winemakers are. They’re not extracting as heavily, but, given that, there’s no sign of added acidity (it’s routinely added in the southern hemisphere), the acidity is coming from the grapes as well. Even some real old Burgundy hands, when you ask why the wines are so fresh, say, ‘I really don’t know.’” About the Southern Rhône, though, she is more pessimistic. “They’re not helping themselves in the Southern Rhône: too many are trying to make concentrated, high alcohol, 16% wines. And maybe consultants are too powerful down there – one consultant can be responsible for 20 or 30 labels, and so you’re going to have 20 or 30 wines that reflect that.” It’s here, though, that the knowledge of grapes, and our possession of this specialist dictionary, seems particularly valuable. If wine is to save itself from the vagaries of climate change, it will probably be through the introduction and new use of ‘marginal’ or forgotten ‘heirloom’ grapes. Only recently, France’s Institut National de l’Origine et de la Qualité (INAO) officially approved six new varieties: four red grapes – Arinarnoa, Castes, Marselan, and Touriga Nacional; and two whites – Alvarinho and Liliorila – all described as ‘well-adapted to alleviate hydric stress associated with temperature increases and shorter growing cycles’, potential saviours of the region against the villain of global warming. All of them, of course, are charted and explicated in Wine Grapes.

In the end, the great strange truth of wine is the truth of life: a thousand vectors press down on us at once – place, history, time, temperature, luck and breeding – and somehow in the intersection we find, or make, our pleasures. The question of type and variation was very different before Darwin who wrote, oddly (or perhaps not so oddly) almost simultaneously with the great classification of Bordeaux, publishing On the Origin of Species in 1859.  (Oddly because his theory would have been true in any other time; not so oddly because the urge to map the world, for the ‘almanac of everything’, was typical of mid-19th century confidence, as Carroll’s satire suggests.) Before Darwin, who loved wine, the fundamental view of the world was that the superintending categories, species and varieties, were the fixed things in the world. Everyone took it for granted that the ‘kind’ the ‘essence’, was the real thing and all the little variants merely particular shades away from it. A grape was a better or worse instance of its variety. Grapes, like apes, were of one fixed sort. Darwin’s great overriding insight was that only particulars exist, and that species and superintending categories are the labile and ever-changing kinds. Every kind of living thing came from somewhere weird and is on its way to somewhere weirder, with a brief stopover at being the thing it is now. The elegance of Pinot Noir is a close cousin of the earthiness of Syrah, one state is simply a moment in the life of the other, and each are moments in the life of the surging, unfixable whole. Wine, braiding through the planet and only coming to rest on a name for a moment in one place, is a bit of scientific epistemology in your glass, the truth of the particular made potable. James Suckling First out of the gate is James Suckling, who is in complete agreement with what we have been told by the châteaux and tasted so far: this is another great vintage for both the Left and Right Bank, forming the third in a trilogy of great vintages for Bordeaux. He writes, “The Médoc reds are closer in character to the 2019 vintage with more linear and finer tannins and precise, pure cabernet fruit while the Right Bank, particularly Pomerol and St.Emilion, is more like 2018 with reds that have more flamboyant fruit and creamier, densely ripe tannins.” While he had heard reports of heterogeneity, 90% of what he has tasted “show an outstanding quality level from first growths to petit chateaux”. He feels that Merlot has excelled, however there are plenty of outstanding wines in the Médoc too – indeed several worthy of perfect scores. While she believes the Right Bank is similar in style to 1989 or the 2018s, she feels the Left Bank has more in common with 1996, 2000 and 2006 due to the tannic profile caused by the dry summer months. “You will find plenty of racy, supple tannins that power forward and have a sense of energy, but also tannins that are a little dry and sometimes underripe if the drought led to blockages,” she says. Despite many similarities in terms of tannin concentration to 2010 and ’16, she feels overall the 2020 vintage is not as consistent as either of these years. For her, the biggest potential issue was this risk of unripe tannins, typically in the Cabernet Sauvignon, mostly affecting the Left Bank. While she notes that some properties’ second wines bear the brunt of this, she commends the exceptional efforts of La Croix Ducru-Beacaillou, Mondot and Blason de l’Evangile. She highlights, however, that 2020 continues a trend in the region, with the best wines performing “a sleight of hand from the vintage conditions” – something that she feels comes from “a confidence that I find in Bordeaux today, where there no longer seems to be the need to choose the biggest tannins for the main estate wine, and instead many choose to prioritise site expression.” All her potential 100-point wines (of which there are five) come from the Right Bank, bar Ch. Margaux which takes the title of wine of the vintage on the Left Bank, while Ch. Canon steals the top spot on the Right. Collectively, they’ve tasted their way through the majority of major releases, publishing a range of articles around the vintage including tasting reports on the Left Bank, Right Bank and white wines of Bordeaux 2020. Perhaps most refreshing to hear is a positive article on the “revolution” that is taking place in Bordeaux when it comes to precision viticulture leading to
“delightfully fresh, expressive, 'new old' wines”. As for 2020, “There are admittedly some stunningly good 2020s, even if [it] is not as consistent a vintage as 2019,” Robinson says. Lawther highlights the surprising freshness of the wines, positioning it somewhere between ’18 and ’19. The lower alcohol levels on the Left Bank “delightfully combine the classicism of traditional Bordeaux with modern winemaking and vine-growing sophistication”. Similarly to Anson’s report, Robinson feels some of the later-ripening Cabernet Sauvignon wouldn’t have reached full maturity before the threat of early October storms forced
vignerons to pick by 30th September (something that didn’t impact the Right Bank with its earlier-ripening Merlot). She feels, however, the overall volume produced on the Left Bank allowed estates to be extremely selective, including only the finest lots in the Grand Vin. All in all, the team declares it a vintage that falls in favour of the Right Bank – with wines that have led Robinson herself to “[fall] back in love with” Saint-Emilion. On the Left, however, Robinson notes particular consistency in the wines of Graves/Pessac-Léognan,  jancisrobinson.com’s highlights: Lafleur, Margaux, Lafite Rothschild, Cos d’Estournel, Haut-Brion, Mouton Rothschild, Pétrus, Angélus, Pichon Baron, Vieux Château Certan, Montrose, Ausone, La Lagune, Léoville Barton, Prieuré-Lichine, Rauzan-Gassies, du Tertre, Kirwan, Canon, Figeac, Pavie Read the team's full report on jancisrobinson.com Lisa Perrotti-Brown MW – Wine Advocate For Wine Advocate’s Lisa Perrotti-Brown MW, 2020 is “an enigma – a vintage that has been more difficult to understand than 2018 or 2019, with far more potential and, in some cases, greater growing season complexities than even 2017 (the year of the devastating frosts).” Despite comparisons with 2018, the wines are, in her view, very different. She highlights the differences between Left and Right Banks this year – with “more weight and generosity” in the latter, and more varied quality on the Left, noting that some from the Médoc lacked mid-palate weight. The key she thinks was the impact of the August rains: welcome relief for some, too late for others, and too much (therefore diluting the fruit) for certain properties in the Médoc in particular.  Overall she feels the variability brings 2020 in line with 2017 in some ways, however thinks that, at its best, the vintage is up alongside 2018 and 2019: “For some areas and terroirs, this is absolutely the third outstanding vintage.”  She notes that it is a simplification too far to declare it a Merlot vintage, as there are excellent wines from both Cabernets too. Pomerol and Saint-Emilion impressed her, while Fronsac and the Côtes de Castillon offer some great-value wines. Like us, she notes some outstanding performances from Pessac-Léognan. In the Médoc, she emphasises the importance of terroirs
with sufficient gravel to drain the August rains, as well as the budget and manpower to do the necessary work to manage the year’s challenging conditions. On the Right Bank, she characterises the best wines as “beautifully pure and perfumed expressions of ripeness”. Pessac is for her “staunchly earthy/savory”, while she warns some are dilute, the Médoc’s finest are “a paradox – lighter bodied, elegant, perfumed head-turners”. He feels it is “better than 2018 but doesn’t quite reach the peaks of 2019”.  While he describes 2018 as more hedonistic and 2019 elegant and purer, he believes the difference between 2019 and 2020 is marginal. “There are instances where 2020 will surpass 2018 and 2019,” he says, believing this will become clearer in bottle.  In his view, lower alcohols on the Left Bank have “allowed for greater expression of individual terroirs and more salinity in the wines”, but the finest examples are wines that also have great concentration. In contrast, the alcohol levels on the Right Bank are generally higher than in 2019 and the best wines of the vintage were those that managed to retain elegance. The 2020s’ slightly firmer tannins in general, Martin believes, will “merit long-term cellaring” compared to the 2019, which can be enjoyed earlier.    Martin highlights the cool nights in August and September as a key factor in determining the success of a Bordeaux vintage, helping the wines retain acidity – and 2020 had just this. These cool nights mean the wines have “excellent acidity levels that engender fresh wines with ample tension”.  As has been the case in the last three vintages, he has found greater consistency in the top hierarchy of wines, where the finer terroirs have kept the vines healthy through a challenging growing season. Despite this, he says there are “still a raft of excellent wines punching above their weight outside the famous appellations, representing outstanding value”.   Neal Martin’s highlights: Margaux, Trotanoy, La Mission Haut-Brion, Canon, Figeac, La Conseillante, L’Eglise Clinet, Lafite, La Gaffelière, Haut-Brion, Léoville Las Cases, Pichon Lalande, Mouton Rothschild, Vieux Château Certan, De Pez, Grand-Puy-Ducasse, La Bridane, Marojallia, La Voûte, Le Chemin, Latour-Martillac and Latour-Martillac Blanc  Read Neal Martin’s full report on Vinous  Jeb Dunnuck  Jeb Dunnuck is undeniably enthusiastic about 2020, declaring it “unquestionably a great vintage”.  For him, the wines more focused than 2018, but denser than 2019 – but feels it sits just behind these two and 2016 in the rankings. He notes that the early season rains have given the wines “a beautiful sense of purity”. As almost everyone has noted, it is this purity and freshness from such a warm vintage that is surprising.  He highlights the advantage of clay and limestone soils, as well as old vines. For him Pomerol is the star of the vintage (with “a bevy of legendary wines”), while Saint-Emilion and Pessac-Léognan also thrived. While he believes 2020 is not as consistent as 2019 or even 2018, he does believe the best examples are “incredibly exciting” and “unquestionably dazzling” wines.   For Galloni, the most important signature of 2020 is “a balance of richness and energy” which he believes is “highly unusual”. From his interviews with winemakers, he surmises that the cold August/September nights, along with the high seed count in the berries are the reasons behind the freshness of the wines, making them “sizzle with brightness and mineral-drenched vibrancy”.   He identifies Pessac-Léognan as the most consistent appellation of the vintage, which benefitted most from summer rains. The Left Bank, more generally, he says is more about “linearity and persistence rather than volume”, providing the wines with a classic feel and notably lower alcohols. Bordeaux 2020: what the critics are saying

“I can die happy now,” Jon Bonné chuckles to me. The writer spent almost a decade as the wine guy at The San Francisco Chronicle, and is now Managing Editor at Resy, having spent time at Punch, writing for Noble Rot, Decanter and many more in between. His latest book, The New French Wine, was released earlier this year and The New York Times wine critic Eric Asimov dedicated an entire column to singing its praises – something he almost never does.  The hefty, two-part tome has been a long time in the making – almost a decade, in fact. The idea was a frivolous suggestion, casually agreed to over one too many drinks (“unsulphured Gamay in Oakland – as one does”) with his editor in 2014, soon after the publication of his seminal The New California Wine. But what was conceived as part of his quest for “the next thing”, to build on the momentum of his first book, rapidly spiralled.  “It's very hard to see a bigger picture of French wine because it is so overwhelming,” Bonné tells me over Zoom. Initially he’d envisaged a few trips, a project that would take a couple of years – but it “kept growing and growing and growing”.  “There was this much bigger story that I was sort of stumbling into,” the writer says. He gradually realised that there was an “enormous meta transformation” taking place across France – and this is what the book wrestles with. As he writes in the book’s introduction, “I imagined the new French wine would be about the undiscovered country – the cracks between known places.” But as he soon discovered, the new French wine was everywhere – and it took him nine years to piece it all together.   The work is split into two separate books – The Narrative and The Producers, the former the story behind the reference guide that forms the latter. The Narrative is a deep dive into the face of France and its winegrowing today, broken down by region, with break-out essays on topics such as natural wine, farming and the appellation system. It’s a rich tapestry of stories, interjected with the frank and striking photography of Susannah Ireland and occasional illustrated map by Francesco Bongiorni, reminiscent of Art Deco postcards.  For Bonné, the “new France” is about postmodernism, about “wilful rejections of the b******t of the past”. It’s about a (re)focus on site, about producers seizing their destiny and hunting for a more sustainable approach – in the vineyard, winery and beyond – although it’s far from that simple. “To understand French wine and to love it, you simply have to embrace its messy, self-contradictory, and, yes, complicated postmodern reality,” he writes. He points to Muscadet and Beaujolais as two of the most exciting and representative regions of this movement – both having entirely reinvented themselves within a generation. Producers here, he tells me, are “doing the work and focusing on terroir and technique and farming”, while Champagne “has completely transformed its vision of what its wine should be”.  Change is most importantly, however, “an inclusive force” – and looking at who did (and didn’t) make it into The Producers, Bonné’s definitive gazetteer of the nation’s movers and shakers, shines a light on this. It’s not a list of the vignerons he loves, it’s a pain-staking selection of those he deems significant and meaningful in the context of the movement – encompassing both more traditional names and those on the fringes. Take the Bordeaux chapter; you’ll find Pétrus, Lafleur and Pontet-Canet, as well as many less conventional, smaller and often natural-leaning properties such as Clos 19 Bis or Ch. Julia – with “Benchmarks” and the more up-and-coming “Names to Know” highlighted.  It’s fascinating – and fun – to see these two, seemingly opposing strands of France’s wine scene woven together. When I queried the inclusion of these elder statesmen of French wine, he highlighted how, for him, Pontet-Canet perfectly exemplifies the change in France today, with the forward-thinking Tesseron family handing the keys to previous cellar master Jean-Michel Comme to do “radical, radical s**t”.  Bonné deliberately chooses to champion those who have revved the engine of broader revolution – and those who reflect that revolution’s values. When it comes to Domaine de la Romanée-Conti, for example, he describes how they “upheld the moral pillars of Burgundy and winemaking” and “use their power for good”; whereas one top Pauillac estate he vehemently tells me is “perpetuating the worst practices of the Bordeaux trade”. For him, “wine is a consumable” and, as 21st-century consumers, “people have a right to explore the values of producers”.   While Bonné certainly likes natural wine – and many of the movement’s figureheads feature in the book, he is far from an evangelist. When he first started thinking about the book, natural wine was different; “It hadn’t quite catalysed into this very specific cultural beast,” he says, a cultural beast born in Hackney, Bushwick or Paris’s 11th. He talks about the movement’s “sense of tragic fashion” and how, with its clique-y nature, it has “baked in its own expiration date”. There were, he tells me, producers that didn’t make the cut – those who act as a “cautionary tale” for natural wine. “There are wines that can be delicate to being transported. And then there are wines that are just f***ed up at the source,” he says frankly.   His outlook is broadly positive for France, the nation’s ongoing revolution and its vignerons, but the book also acts as a call to arms of sorts, for: “The enforcers of the old ways will be forced to adapt, or they will perish,” he writes.  It’s not a perfect book. With a work of this size (over 860 pages and 600,000 words), it is almost inevitably slightly out of date by the time it is printed – especially with the pace of change today. Lafleur’s entry, for example, talks of Acte but not Les Perrières. I’d also have loved to have captions for each of Susannah Ireland’s images, knowing where – and of whom – they were taken. But these are quibbles.   I can’t pretend to be unbiased. Bonné is one of my favourite wine writers. There’s a lightness to his phrasing, with dry humour and a palate that I tend to identify with – although I’d argue he’s become a little more funk-friendly over the years. His writing is intelligent without being arduous. Perhaps it’s because, like Andrew Jefford, he was and is a journalist first. What really fills his writing is a sense of joy, of almost gluttony – it’s still filled with the excitement that so many wine writers seem to lose, as they tire of bottle after bottle of exceptional wine. He’s still easily absorbed by the stories that make each one different. For me, he doesn’t fit neatly into the critic box, even though it’s a term he uses to describe himself repeatedly in our conversation. “The notion of a critic has devolved to a place where you are simply handing out numbers,” he explains, but to him his work is about “criticism at a deeper level”. It’s about “being able to dive into the culture and come away with the insights and interpretation, and explain why certain wines really do matter”.  And it is this that makes The New French Wine stand apart. It isn’t just a wine book; wine is the lens through which Bonné observes a broader cultural shift. Whether you agree with everything he says or not, it’s a joy to read, hold and look at. It’s a book that will prompt conversation, prompt you to uncork bottles, prompt you to consider quite how complicated – and endlessly fascinating – France’s wine scene is. Local delivery is free for orders over HK$1,800 (to a single location). For orders below this value, delivery is HK$150 for up to four cases and HK$50 per case thereafter.

Shipping starts from €15 within Italy and €45 to Switzerland and the rest of Europe for up to 48 bottles (75cl). Costs vary by destination. Larger shipments can be quoted on request.

Wines sold en primeur will be released from the producer after bottling, typically 18 months after the so-called campaign ends. Upon arrival your wine will be stored at Vinfolio in our temperature-controlled warehouse until you decide to take delivery.

We will source this item at the guaranteed price from our network of suppliers and arrange expedited shipment to FINE+RARE.
 The lead-time depends on many variables, but 2-4 weeks is typical for expedited sourcing.
