Vega Sicilia is undoubtedly Spain’s most famous winery; a true icon in fine wine with a history dating back to 1864. Its success in retaining such a reputation, and in almost complete isolation in the Ribera del Duero region of Spain, is testament to the quality and consistency of its production, although its history has not been without its challenges. Vega Sicilia claims to be one of the longest-aged and longest-lived red wines in the world, with its flagship Unico capable of maturing in bottle for well over sixty years under the right cellar conditions. Developing its style in such solitary conditions has created a wine distinct from any other and whilst the Ribera region has flourished with the establishment of wineries such as La Pesquera in the 1970s and more recently the cult wine of Pingus, Vega Sicilia today remains at the apex of the appellation.  We explore the history of Vega Sicilia, the secrets behind its success and the changes afoot as it attempts to retain the traditional methods it has become famous for whilst modernising the winery and updating its processes. We also explore the contrasting range of wines it produces from the Valbuena to the Unico Reserva Especial: Vega Sicilia’s nod to the traditional Spanish practice of producing multi-vintage premium blends. The history of the estate The estate that would become known as Vega Sicilia was founded in 1864 by Don Eloy Lecanda Y Chaves, a Spanish vigneron who inherited the property in 1859. After visiting Bordeaux he brought cuttings of the Bordeaux varietals of Cabernet Sauvignon, Merlot, Malbec and Carmenere, as well as Pinot Noir, and planted 18,000 vines at the estate in Ribera del Duero alongside the native varietal of Tinto Fino (Tempranillo). By 1882 he had planted 500,000 vines on the estate, at the time known as Bodegas Lecanda.  The introduction of Bordeaux varieties was perhaps not that unusual at the time, since the Bordelais were becoming more and more influential in Spain (most notably in Rioja) having disbanded their operations in Bordeaux following the phylloxera outbreak and were actively looking for alternative regions to grow their grapes.  However, in Rioja, the Bordeaux varieties were soon replaced by the native Tempranillo which proved a much more reliable and profitable choice. Whilst Don Eloy Lecanda Y Chaves initiated a winery that was to change the history of fine wine, he was initially using the grapes to make brandy rather than still wine. Although the brandy was well received amongst the aristocratic families (no doubt piquing the interest of the Herrero brothers), the estate struggled financially to make ends meet and he died in 1894 never to witness the success of his venture.  The property was bought by the Herrero brothers in the early 1900s who renamed it Vega Sicilia. As phylloxera eventually reached Rioja, the négociant Cosme Palacio was looking further afield to maintain supply for his customers. On discovering Vega Sicilia, he immediately rented the property from the Herrero brothers.  He brought with him winemaker Domingo Garramiola Txomin who introduced the Bordeaux techniques of ageing wine in barrique as well as extending the élevage. He also initiated bottling the wine on the estate (Cosme Palacio was previously shipping the wines in bulk to Rioja).  The Herrero Brothers were a well-connected upper-class family who were galvanised to produce a wine of exceptional quality no matter the cost, to sell to their aristocratic friends. This quest for quality combined with the skills of Domingo Garramiola Txomin, as well as the unique combination of Bordeaux varieties and Tinto Fino (thanks to Don Eloy Lacanda Y Chaves), was the perfect recipe for producing Spain’s first iconic wine – Vega Sicilia Unico. The first vintage of Unico was produced in 1915.  Thanks to the connections of the Herrero brothers, within two decades Vega Sicilia had become the most revered winery in Spain. Even at this time the wine had built up a reputation for its extraordinary ageing capacity. At Vega Sicilia the Bordeaux varieties became a key component to their flagship wine of Unico and have remained in the blend right through to the present day. Throughout this time, the property became almost a self-contained village, with a school and chapel on site and many of the families working at the winery and living on the estate. Despite the winery changing hands a number of times over the last century, Garramiola’s legacy has lived on through the winemakers that followed in his footsteps; figures like Martiniano Renedo, who was initially Garramiolo’s assistant, and especially Jesús Anadón, who was instrumental in maintaining the quality and reputation of the wine through the middle of the 20th century.  Amazingly there are workers on the estate today whose families have worked at the winery for generations. Today the master cooper at Vega Sicilia, along with his brother Jesus Yanez, is the fourth generation of his family to work at the property. The winemaker between 1968 and 1998, Mariano Garcia, was the son of one of the farm workers on the property.  Despite its global reputation, its exclusive allocation list and long history, the winery and vineyards went through bouts of dilapidation during the 1950s, through to the late '70s, whilst at the same time producing some of the most legendary vintages. On purchasing the property in 1982 the Álvarez family began to make huge investments into the estate, renovating the winery and carrying out an extensive replanting program in the vineyards. 1982 was also the year Ribera del Duero was awarded its DO appellation status and no doubt helped further promote Vega Sicilia as the historical icon of the region. The winery and the appellation has never looked back since.  In the vineyard Vega Sicilia is situated on what is known as the “golden mile”, a stretch of road between Pañafiel and Tudela de Duero, where the prestigious wineries of Vega Sicilia, Pingus and Pesquera are all situated. Driving through, it is a somewhat underwhelming sight as far as vineyard vistas go, so much so you could almost pass through it without noticing.  Being an altiplano there are no sweeping mountainous views, you only feel the altitude from the freshness of the air. In the higher vineyards of Soria at the edge of the Ribera appellation you are rewarded with more vistas, as well as a sense of history with evidence of prehistoric cave-like dwellings where farmers sheltered from the extreme climatic conditions of this largely desolate region.
 Whilst there are pre-phylloxera ungrafted vines dating back over 100 years dotted around the region, the vines at Vega Sicilia - with vineyards at 700 meters - average around 35 years of age. Vega Sicilia have an extensive replanting scheme in their vineyards preferring the quality of their fruit in their mid-life as opposed to old age, with typical vine age in Unico around 60-65 years old, with the younger vines going into the Valbuena cuvée. The high altitude and continental climate mean extreme conditions are at work in the vineyards. Winters can be very cold whereas the summers can be fierce. Most notably in regards to grape growing, due to the altitude, there is a huge diurnal shift in temperatures from day to night helping to retain the acidity and freshness in the grapes whilst reaching high levels of ripeness. The main grape in all Vega Sicila wines remains the Tinto Fino (the particular clone of Tempranillo) distinct to the region. The Tinto Fino is said to produce smaller berries with higher concentration of tannins compared with the Tempranillo grown in Rioja. The Unico also has a proportion of Cabernet Sauvignon in the blend (anything from 6-20% in more recent releases) with a higher proportion in older vintages. In the Valbuena, the majority of the blend is Tinta Fino with a small amount of Merlot (typically 5%) . The property is huge in scale with 200 hectares of estate-owned vines producing anything from 40,000 to 100,000 bottles of Unico each year depending on the vintage.  
In the winery
 Unico  The style of the flagship cuvée of the winery has remained virtually unchanged since its inception in terms of production, although assemblage has modernised. Élevage times have reduced and the influence and proportion of Bordeaux varieties has become less in more recent releases.  In the past, Unico was only made using huge 40,000-litre fermentation tanks (this was all that was available at the winery) therefore in a difficult vintage, if this sort of volume was not possible at the quality level they expected, then no Unico would be released that year. Since 2010 the winery has introduced smaller 8,000-litre tanks, enabling smaller micro-vinification of their wines and suggesting a release of Unico every year (in varying quantities) is more likely. The winery today operates at a spec similar to the top estates in Bordeaux. They have introduced 81 separate fermentation tanks allowing them to carry out intra-plot fermentation. They have introduced highly sophisticated sorting tables, there is more temperature control of the wine and the winery is now completely gravity fed enabling greater precision when it comes to winemaking.   Following fermentation, the wines destined for Unico are blended in small oak barriques (50% French oak / 50% American oak) for 12-24 months depending on the vintage. The French oak is 100% new whilst the American oak, coopered on site, tends to be one to four years old. Following barrique ageing, the wine is then transferred to large old oak casks where it typically matures for five years before being bottled and aged further prior to release. Unico is typically released at 10 years old. Valbuena 5° The Valbuena typically comes from the younger vines of the estate and is aged in oak in barriques for 12-18 months before being transferred to larger old oak casks for a further 18 months prior to bottling. It is then aged for two years in bottle. Valbuena is typically released at five years old. Unico “Reserva Especial” The Reserva Especial is the mythical bottling that initiated the Vega Sicilia legend. It is made up of choice parcels from a blend of vintages (in recent releases it tends to be select parcels from three vintages). Prior to the 2001 release, details of the blends of older bottlings are not very easy to come by. With only 15,000 bottles produced this is the rarest cuvée from Vega

2018 Ch. Mauvesin Barton (in jeroboam) + Champagne Elise Bougy, Le Mesnil – chosen by Damien Barton-Sartorius  “To me, a meal is always about a moment. Sometimes very important ones such as announcing a baby, sometimes it’s more casual as would be a meetup with friends. I like to think that the bottle should never be more important than the moment. It should not frustrate the generous person who wanted to share a special bottle that becomes overlooked – or even worse steals the show... Unless it is the show! The special bottle then becomes a moment of its own. It is an interesting thing (and sometimes fun!) to taste great labels blind, judge them on their value/pleasure. But it tears away what wine should be: excitement. If I am going to drink a Mouton Rothschild 1945, I honestly don’t really care if it’s good or not. It’s a piece of history in a bottle that I will be sharing with friends and I would really like to know this ahead of time so I can be excited about it for as long as possible. Just like planning holidays ahead!  “Christmas is an important moment but the moment is family, not the wine that will be put on the table. I want a wine that will trigger some chat. Briefly – before enjoying the wine as a lovely drink, fuel of diverse conversations. There should be enough of it to spend some time with it. Aim for large format. We all know that even a magnum can be short…  “To be very personal here, I just got married and I will spend my first Christmas Eve with my wife’s family. A bit of home, some volume to enjoy and share: Ch. Mauvesin Barton 2018 in jeroboam is my choice for dinner. Oh but what would Christmas be without Champagne… a sneaky bottle to share only with my wife before the dinner: Elise Bougy Le Mesnil. Now I am excited for Christmas!”  Damien Barton-Sartorius is the 10th generation of his family to run the Bartons’ Saint-Julien Classed Growth estates (Ch. Langoa Barton and Ch. Léoville Barton), while his sister Mélanie is at the helm of Ch. Mauvesin Barton, together continuing their grandfather Anthony’s and mother Lilian’s legacy. 2010 Ch. Latour, Pauillac – chosen by Jonathan Maltus  “We’re drinking Ch. Latour 2010. There are 10 of us – all family – two grandparents, four parents and the rest kids. As a family we don’t enjoy turkey so we have beef Wellington – which I’m hoping this will go well with.” Jonathan Maltus is the man behind the Saint-Emilion property Le Dôme, one of Bordeaux’s original garagistes. 2001 Richebourg, Grand Cru. Domaine Hudelot-Noëllat – chosen by Charles van Canneyt “For dinner, a Richebourg 2001. Perfect to drink now and taking full advantage of the complexity and power of a Richebourg – with a good capon! We had Suchots 2017 – all about the fruit – when we put up the tree, a vintage that’s approachable young and very enjoyable!”  Charles van Canneyt is one of Burgundy’s most talented winemakers. The young vigneron is at the helm of Domaine Hudelot-Noëllat, based in Chambolle-Musigny, and also has a négociant label under his own name.  2015 Ch. Haut-Bailly + 2019 Meursault, Les Vireuils, Domaine Roulot – chosen by Véronique Sanders “It’s so very difficult to choose just one bottle… while many people start their celebration with Champagne I always love to start (and finish) with a glass of Sauternes or Barsac. Right now I am loving Ch. Haut-Bailly 2015 which is so charming and is pure pleasure! Of course I also love wines outside of Bordeaux – white Burgundy being my weakness… I have my eye on a bottle of Domaine Roulot Meursault Les Vireuils to share with the family this year.”  Véronique Sanders is the powerhouse at the helm of Ch. Haut-Bailly, the leading Pessac-Léognan estate.  2018 Paul Cluver Estate Chardonnay, Elgin, South Africa – chosen by Spencer Fondaumiere  “I grew up in Nairobi at a time when the wine scene was not nearly as advanced as it is now. My mother enjoyed her wine. My dad was a beer man through and through. What was regularly available was wine sold in five-litre boxes labelled as ‘late harvest’, with just enough sweetness to interest you to get to the bottom of the bottle – or more accurately the last dredges of the cask. I have now lived in Cape Town for the last 11 years and my wine appreciation has grown a little bit beyond the voluminous late harvest on tap.  “Christmas is a time for family and my mom and dad will be spending the holidays with me and my family. Since I last saw her, Mom has developed an appreciation for cool-climate Chardonnay and I am quite keen to crack open this bottle that has a bit of age on it. I am hoping it will be like nothing she has ever tasted before and I am hoping even more that she will like it. Dad, on the other hand, remains partial to beer, but every Christmas I optimistically open a bottle and hope that this will be the wine that converts him into a wine lover. That being said, there is not too much 2018 Chardonnay hanging about so it may not be the worst thing if this doesn't turn out to be the one.”  Spencer Fondaumiere is one of the most exciting names on Africa’s wine scene. The Kenyan chef-turned-sommelier and serial entrepreneur is now Chairman of the South African Sommelier Association and has two businesses – using his expertise to advise wine-drinkers, restaurants and producers via Slowgold and Wineyard East Africa. A trio of Bouchard’s best – chosen by Frédéric Weber  “For Christmas with my family, I have planned a 2016 Meursault Genevrières to accompany the foie gras that my sister makes herself every year. I like the combination because our Genevrières has just the right freshness and delicacy, especially in 2016, to awaken the tastes and accompany the sweetness of foie gras seasoned with a touch of Sichuan pepper and a hint of fleur de sel, a great match! With the duck, of course a Beaune Grèves Vigne de l’Enfant Jésus 2003. Two-thousand-and-three was my first vintage in the house [at Bouchard], 20 years ago already, great memory of this harvest and Baby Jesus is a nice wink for Christmas Eve! And then a Corton 2013, my mum loves Le Corton and we don't refuse her anything.”  Frédéric Weber is the detail-oriented Head Winemaker at Bouchard, one of Burgundy’s leading, quality-focused producers and négociants. He has been at the company since 2002, taking over fully from his predecessor Philippe Prost from the 2014 vintage.  Champagne Corbon, Brut d'Autrefois, Avize (and a couple of back-up bottles) – chosen by Chris Gaither MS  “Christmas is always a special time of the year for my family. My wife, Rebecca (also a Master Sommelier), who is Jewish, always looks forward to the combo of Hanukkah and Christmas celebrations back-to-back, especially with our young daughters. We tend to favour multiple evenings of delicious food and drink that we can enjoy, albeit with moderation. And she and I rarely finish a bottle when drinking together at dinner, if it's only the two of us sipping. Surprised? It’s partially because we have two kids and run two businesses (Ungrafted and GluGlu), so work doesn’t stop even after dinner! So, on Christmas evening we'll be having a low-key 'Jewish' Christmas dinner, with a few other Jewish families. We are going to order Chinese food from one of our favourite restaurants in Millbrae (Wonderful is the name if you'd like to know), and chow down on some tasty dishes with a few of our favourite bottlings from producers we admire.  “Rebecca and I are huge fans of Champagne, and most times if you ever see us sipping on something together, it's usually just that. Champagne Corbon is a tiny grower based in the Vallée de la Marne (run by Agnès Corbon – ladies rule!), but they sell a good portion of their fruit from their vineyards there. They own two hectares of vineyards in Avize, of which they use to produce most of their wines. The Brut d'Autrefois is based on a 35-plus-year-old perpetual reserve (or solera) that is roughly based on 90% Chardonnay and 10% Pinot Noir. The solera consists of a single neutral oak vat that is 50% drained each year for bottlings of D'Autrefois, and then refreshed with a new year's vintage. Delicious, exuding a bit of richness, with nice texture, and loads of complexity. We were fortunate enough to get a few bottles of these, and I think we'll be drinking the last one we have... for now... The other bottles are ‘just in case’ bottles that we love.  “2018 Domaine Weinbach, Riesling Schlossberg, Grand Cru, Alsace: Who doesn't like Riesling? Any sommelier with street cred will tell you to drink more Riesling – it's routinely underappreciated in the world of wine, and you can get fantastic examples that are made with the same care as Grand Cru wines in other regions, but at less than half the price. Weinbach is one of our favourite domaines within Alsace, and it is currently run by Catherine Faller (again, shoutout to all the ladies making the magic happen in wine!) and her sons, Eddy and Theo. This Riesling is coming from their holdings in Schlossberg, the first Grand Cru to be ratified in Alsace in 1975. The wine almost always has a deftly balanced touch of botrytis, with lovely bruised apple and peach, with a very noticeable meyer lemon twang on the finish.   “2011 Fixin, Premier Cru, Clos de la Perrière, Domaine Joliet Père & Fils: This particular vineyard is a monopole within the village of Fixin, and this bottling is 100% Pinot Noir. It is run by Bénigne Joliet, who purchased the vineyard from his other family members in 2004, with the goal of making the Clos de la Perrière one of the more famous vineyards in the Côte de Nuits in Burgundy. Rebecca had the opportunity to visit the estate and meet Bénigne back in 2014 on a visit. She purchased the bottle of 2011 Clos de la Perrière on this trip. I’m super excited to drink it with her! She’s great at putting bottles away and not touching them!”  Chris Gaither MS was born in Atlanta and started working in hospitality to help pay the bills while at college. He gradually fell into the wine side, becoming hooked and – after a stage at The French Laundry in 2008 – launched into San Francisco’s wine scene, working at top restaurants and earning various awards. He became the fourth black person to pass the Master Sommelier exam when he passed in 2022. Married to a fellow Master Sommelier, Rebecca Fineman, together they own and run two restaurant/wine bars, Ungrafted and Glu Glu, in San Francisco. 2003 Chinon, Les Roches, Domaine Alain & Jérôme Lenoir – chosen by Ivan Massonat  “Of the (many) bottles I intend to open, one is high on my expectation scale: a 2003 Chinon from Domaine Lenoir. It’s a bare bottle, without any label nor cap, that I bought from Jérôme [Lenoir] a couple of years ago, after a few hours of tasting down in his ‘cellar of wonders’. After tasting several decades, 2003 had struck me as super fresh and elegant, like magically untouched by the famous 2003 summer heatwave in France. I would like to open it for New Year’s Eve, with one my best friends from high school who’s also a wine lover – and not a label drinker!” Ivan Massonat is the ex-financier that created Domaine Belargus, the Anjou estate that has fast become one of the Loire’s most famous, shining a light on its varied terroir through a single grape – Chenin Blanc. Stellar Spanish and South American bottles – chosen by Carlos de Carlos  “This year we have some cousins from the USA that will come home for Christmas evening and dinner. As they come to try some good South American wines, I will drive them around some of my all-time favourites for dinner. So the selection will be: Baettig Los Primos Chardonnay 2021 for the aperitivo. A wine that shows the very best of the south of Chile with a finesse and minerality that I love. Then Viña Cobos Chanares Malbec 2018 – one of my favourite wines in Argentina coming from Los Arboles in Tunuyán, Valle de Uco. Really special vintage from a really unique vineyard! And the grand finale will be Vega Sicilia Unico Reserva Especial 2008-2009-2010 [the 2020 release] – not only because the wine itself, but also because it was a very special present for my birthday that a very close friend gave me… and will be tasted alongside my favourite dish, Spanish paella.” The charming Carlos de Carlos is one of the founders of Baettig, along with winemaker Francisco Baettig, a Chilean producer that is one of our favourites. A flight of Champagne, Burgundy and Bordeaux – chosen by Blandine de Brier Manoncourt  “This Christmas my family will begin with a fabulous Champagne, Laurent Perrier’s Grand Siècle Itération No. 26, which we will enjoy as an apéritif around the tree. At the table, our dinner will begin with Corton-Charlemagne from our dear friend Stéphane Follin-Arbelet, the 2008 vintage, which will pair perfectly with a lobster dish. Next is, of course, Figeac! First the 2010 vintage of Ch. Figeac – it is magnificent right now, and goes very well with truffled capon. Finally we will enjoy our favourite vintage of Ch. Figeac, the 1990. We wish everyone a very happy Christmas and a wonderful New Year!”  Blandine de Brier Manoncourt is daughter of the iconic Thierry Manoncourt who established Figeac’s modern reputation. Having studied at Sciences Po Bordeaux, she is Co-owner and General Secretary, especially involved in managing the property’s heritage.  2001 Ch. Figeac – chosen by Frédéric Faye  “My family is very excited this year to serve one of my favourite vintages of Ch. Figeac at our Christmas dinner, the 2001. This is a vintage in its full maturity, a vintage which sadly is often overlooked by wine-lovers but is in fact one of the great references of the property. Fresh, elegant, with a beautiful concentration… it will pair perfectly with ris de veau in a sauce à la morille. Wishing a happy Christmas and New Year to you and your families!”  Frédéric Faye is Managing Director of Ch. Figeac, where he has been working for over two decades, having arrived as an intern in 2002. Blanquette de Limoux, Antech, Brut Nature – chosen by Christina Stanley  “I share a holiday tradition of sipping bubbles with my mum while cooking, before any guests or family arrive. My dad suffered a stroke back in 2014, and she is his caretaker. Last year, when she tasted Varnier-Fannière Blanc de Blancs, she said, “This tastes like every good time I have ever had,” but Champagne is not what we drink while cooking. You know what’s great with a splash of orange juice? Antech Blanquette de Limoux Brut Nature. It has delightfully bright, lemony acidity, an abundance of chalky minerality, and it’s inexpensive. The main grape is Mauzac, locally known as ‘Blanquette’. Wonderful as a versatile aperitif and perfect as a Mimosa base, Blanquette de Limoux plays a starring role in any holiday gathering.”  Christina Stanley is an Advanced Sommelier and the Wine Director at The Slanted Door Napa – an outpost of Charles Phan’s group of legendary restaurants that are a reference point for fine dining and modern Vietnamese food. 2008 Merlot, Miani, Colli Orientali del Friuli – chosen by Michele Dal Forno  “I think I would pick a Merlot from Miani. Enzo, the owner, is truly the ‘last of Mohicans’ of vignerons in Italy, as he is seriously devoted to his vines and the wines he makes are a pure expression of each varietal he grows. I was lucky enough to taste many of his wines last summer with himself and some other friends and I was shocked by the genuineness of them all. In particular the Merlot 2008 was so fresh and rich that I was literally blown away when I tasted it. If you want to understand how an authentic Merlot should taste, Miani is the one.”  Michele Dal Forno is one of Romano Dal Forno’s sons, founder of the legendary eponymous Valpolicella estate  1988 Ch. Montelena, Napa – chosen by Maya Dalla Valle   “After a fantastic 2023 harvest, we are relaxing and celebrating this holiday season. At our most recent team holiday dinner we decided to open a magnum of 1988 Ch. Montelena to commemorate the successes of the 2023 growing season and vintage. With the recent passing of Mike Grgich, it was also an homage to one of the great winemakers of Napa. The wine was stunning, and well appreciated by all of us as red wine producers.”  Having travelled and made wine around the world, Maya Dalla Valle returned to Napa in 2017 to make wine with her mother Naoko at Dalla Valle, as well as embarking on a new project in collaboration with Ornellaia, DVO. 2016 Champagne Henriot, L’Inattendue – chosen by Stefan Neumann MS  “Expect the ‘unexpected’! Henriot’s single expression of Avize called L’Inattendue (translating literally as ‘the unexpected’) from the 2016 vintage is something I look forward to sharing with my family on Christmas Day. Full of energy, this pure Chardonnay gives me on the one hand the comforting softness of spiced pear and golden apple, but on the other hand the razor-sharp freshness of lemon and orange peel. This, in front of the family’s Kachelofen (tiled ceramic stove), paired with a freshly cured trout, might sound simple yet is heaven to me. If life has taught me one thing – you can’t beat an old-time classic.”  Austrian-born Master Sommelier Stefan Neumann cut his teeth at restaurants in Vienna and Salzburg before moving to the UK. He’s worked at many of Britain’s most illustrious establishments, most recently on the floor at The Fat Duck. 2019 Meursault, Premier Cru, Gouttes d’Or, Louis Jadot Gouttes d’Or is one of the cooler Premier Cru sites in Meursault and therefore excels in warmer vintages. It was certainly one of our picks from Louis Jadot in 2019. It has a beautifully rich golden colour and a lovely expressive florality on the nose. It is pure opulence on the palate, full-bodied, exhibiting huge, spherical breadth which fills the palate. Honeyed melon, yellow plum and white peach fruit are in abundance but the wine tightens up nicely on the finish. This is a wonderfully intense and serious Chardonnay. 2019 St Aubin, Premier Cru, La Chatenière, Joseph Colin The talented Joseph Colin (brother of Pierre-Yves Colin Morey) continues to impress with his superb range of whites. This dry, stony plot gets an hour less sun, shielded from the rising sun by the slopes of En Remilly/Dents de Chien – an hour that makes a huge difference in the resulting wine, which was a stand-out from the range. On the nose, it’s pretty, floral, dainty and mineral, while the palate is soft and supple, with the most  extraordinary silken texture. By contrast, the flavour profile is tightly wound, with a mineral line, concentrated citrus and subtle white blossom. Ethereal yet powerful, it will be a joy to watch this evolve. 2019 Puligny-Montrachet, Premier Cru, Clos de la Mouchère, Domaine Henri Boillot Guillaume Boillot is particularly pleased with the 2019s – with their perfect balance and, for the whites, a real floral character that runs through the range. The four-hectare monopole vineyard Clos de la Mouchère is always a favourite – this sub-section of Perrières producing a particularly honeyed expression of the site. There’s a real roundness to the wine in 2019; it’s soft, intense and long. Vibrant citrus fruit and minerality drives the wine, but there’s a suppleness that surrounds a core of real energy. With air, notes of white nectarine, acacia honey and freshly cut hay emerge – adding richness and weight. Particularly concentrated and fine. 2019 Vosne-Romanée, Premier Cru, Les Suchots, Domaine Lamarche Nicole Lamarche has no doubt made some of the most ethereal reds in the vintage. Picking at least a week earlier than most of her neighbours, all her wines sit comfortably below 13.6% alcohol. Her winemaking is reliant on her continual tasting of fruit, must and wine to dictate her vinification processes. Every cuvée is approached differently. Despite this bespoke approach, the consistency across the board is commendable. It makes it difficult to pick a favourite in the range but her Suchots is incredibly serious – competing with wines 10 times its value. It is an endorphin-releasing Pinot Noir in which the purity of fruit and exceptional balance leaves you forgetting about flavour and thinking about feeling. It reminds you how good red Burgundy can be with fantastic terroir and an adept hand. 2019 Clos de la Roche, Grand Cru, Domaine Georges Lignier Benoît Stelhy believes 2019 is “amazing”, the vintage of his career – or at least he did until 2020 arrived. No less, the 2019s here are superb, although there’s sadly not a lot of them – with yields down by up to 50%. His Clos de la Roche really shone at our tasting. Delicate florals combine with crunchy red fruit to make a truly delicious wine. It’s intense, with the tannins building subtly in the mouth – they’re round and soft, yet coat the cheeks and gums. The sweetness of the new oak (40%) coats the dark fruit, while the palate has a savoury freshness thanks to the whole-bunch (30%). It finishes long, with a chalky line and redcurrant bite. 2019 Beaune-Grèves, Premier Cru, Le Vigne de l’Enfant Jésus, Bouchard Père & Fils Frédéric Weber at Bouchard thinks 2019 is “a huge vintage for the future” – and the domaine’s iconic Vigne de l’Enfant Jésus is case in point. This section of Les Grèves Premier Cru is the “filet mignon” of the vineyard – the most desirable section, right in the middle of the slope, with well-drained gravelly soil which tends to ripen earlier. The resulting wine has a distinct spicy, floral nose – think black pepper, cloves and violets, with a toasty edge. There’s real richness and weight, with a luxurious creaminess to the wine on the palate, which is laden with muddled black berry fruit, cut by chalky minerality and juicy raspberries. Vibrant, balanced and concentrated with seamless tannins, this is superb. 2019 Chambertin Clos-de-Bèze, Grand Cru, Olivier Bernstein The wines of Olivier Bernstein are a masterclass in dynamism. The wines feel so alive when you taste them. It’s hard not admire Olivier Bernstein’s honesty when he says how each of his cuvées take it in turns to show up: one week the Clos de la Roche might be flexing its muscles, another week it is the Mazis-Chambertin. The Clos de al Roche was one of the highlights of a spectacular set of Grands Crus in 2018, a vintage Bernstein believes to be his best, but another favourite was the Chambertin Clos-de-Bèze which effortlessly ticks all the boxes for what you want in a Grand Cru. The tannin structure is built like a cathedral, so detailed and compact, while at the same time fleshing out on the back-palate and providing so much breadth. The berry fruit remains precise and fresh, and distinctly red-fruited, while the finish is sapid and saline. It is truly a magical wine. 2019 Vosne-Romanée, Premier Cru, Les Malconsorts, Domaine du Clos Frantin, Albert Bichot The Albert Bichot wines continue to improve under Alain Serveau’s stewardship. They are the largest owners of Malconsorts, with 1.76 hectares of this excellent Premier Cru. In 2019, there’s something almost imperial about the wine – both sophisticated and opulent. The nose fills with a richness of red cherries, complemented by a touch of plum. The palate is intense and tight, the tannins fine and supple. Laden with ripe, bright red berry fruit and juicy acidity, it’s a gorgeous wine in 2019. 2019 Corton, Clos des Cortons Faiveley, Grand Cru, Domaine Faiveley Faiveley today is the sixth-largest domaine in Burgundy and, despite its expanding size, the wines are only getting better – most notable with a change in winemaking from 2006, shifting to a much lighter touch during extraction. The renovation of their magnificent winemaking facilities in Nuits-Saint-Georges has also improved their ability to find detail and distinct personality in each of their wines. With huge barrel cellars, they are also able to have extended élevage to 16 to 18 months, creating wines with great volume and integration. The true star of their extensive collection of vineyards in the Côte d’Or must be the monopole Clos des Cortons Faiveley Grand Cru. The detail on the nose is extraordinary – dried aromatic tea interspersed with pristine red berry fruit, blood orange and a gorgeous vinosity. The spectrum of flavour is staggering, whie remaining succulent and generous in both breadth and concentration. It’s another remarkable wine in a fantastic vintage for the estate – albeit with 30% less made this year. 2019 Clos des Lambrays, Grand Cru, Domaine des Lambrays Domaine des Lambrays’s flagship site is almost but not quite a monopole, with an ouvrée – less than 0.2 of the total 8.84 hectares – at the bottom of the clos belonging to Taupenot-Merme. Yields here were down to a measly 15hl/ha in 2019 – although winemaker Jacques Devauges assigns this partly to their ongoing conversion to organics, but the quality is clearly there. Most of the vines (71%) date from between 1898 and 1935, while the lowest section of the vineyard is 40 years old, and 3% of the vines are spritely 20-somethings. It was fascinating tasting the three sections of this large Grand Cru separately and then as a blend, seeing how each one contributes its own character.  There’s the exoticism of the side near Clos de Tart; the more angular, structured and firmer top section; and the intense, vibrant fruit of the lowest part of the vineyard. Combined, the wine has remarkable concentration – much more than a sum of its parts, building gradually on the palate with layer upon layer of bold, blueberry fruit and sweet-savoury spice, yet plenty of the vintage’s moreish acidity. As Jacques said rather modestly, “You want to drink it.” We might be inclined to go a little further, given the quality and ageing potential on show here – but it’s hard to resist now. Valpolicella from maestro Romano dal Forno   February sees the annual release from Valpolicella’s pioneering Dal Forno estate. The sad news is there will be no new Amarone release this year. The 2014 vintage was difficult across Italy and Dal Forno was hit badly by hailstorms in June which only reduced the yield further. The grapes were deemed too fragile to undertake the long two-year drying process necessary for Dal Forno’s Amarone. The silver lining is that the top fruit went into their Valpolicella Superiore, which is already a canny buy in any year. The production of the Valpolicella is 30% down on normal years so it will be in short supply. To make up for the lack of a new Amarone release, the winery will be releasing a rare set of Amarone magnums from the 2011 vintage – one of the finest in the winery’s history. Look out for them later this month.  The king of kings: Château Latour’s first 2016 release  Pauillac de Latour is the ever-popular “third” wine from the First Growth Bordeaux estate Château Latour. The wine captures the purity and precision that defines Latour, but with a softer, more approachable structure, allowing fans of the estate to enjoy an earlier-drinking offering at an enticing price for the pedigree. The 2016 vintage, now in bottle, is widely acclaimed as one of the greatest modern vintages of Bordeaux, which only makes the release more exciting. Latour 2016 was without question one of the top wines of the vintage, awarded 100 points across the board from the world’s leading critics. This sibling, made by the same team, offers an affordable and approachable insight into this extraordinary estate and vintage.  The latest from Madame Lalou Bize-Leroy   The annual release from Leroy will be out this month. Exact release dates are never disclosed but we are expecting to see them any day now. The Maison wines will be released first, followed by the domaine wines from d’Auvenay later in the month. While we can’t confirm exactly what will be available, we can disclose that the selection this year has some exceptional vintages from some of the region’s top villages. This artisan, ultra-premium producer is based in the town of Jésus María, at one of the highest points in the highlands of Jalisco, a location that results in a particularly flavourful agave spirit. Bottled in handmade and painted ceramic decanters, these are some of the most exciting agave spirits we’ve seen – and you’ll have the chance to sample them before the month is out.   From further afield: spotlight on Switzerland and Lebanon  We will be putting some under-the-radar regions in the limelight over the next month. You’ll see the new exceptional Pinot Noir and Chardonnay from Donatsch, a winery that has put the Bündner Herrschaft region of Switzerland firmly on the fine wine map. Lebanon’s fine wine specialists are set to release their 2014 – a low-yielding, high concentration vintage that comes highly recommended. Ch. Beauséjour Duffau-Lagarrosse clearly has some fantastic terroir. One of only a handful of top-rated Premier Grand Cru Classé B estates, it is beautifully positioned on the southwest-facing slopes of Saint-Emilion’s famous limestone plateau. The property gained notoriety with the release of its 1990 – a wine Robert Parker professed as being “the wine of the vintage” en primeur – in his view beating other legendary wines from the year, such as Margaux, Pétrus and Latour. After maturation in bottle, he went further and declared that it may be “one of the greatest wines made this century”. A legend was born. This historic estate has been in the Duffau-Lagarrosse family since 1847, but Joséphine’s recent take-over was far from straightforward. Prior to the sale, it was owned by 30 members of her family. With the majority wanting to sell the property. Determined for it to remain part of the Duffau-Lagarrosse legacy, the only option was to attempt to buy it herself – no small feat for the then 30-year-old. But this prime-positioned Saint-Emilion estate had plenty of bidders queuing to snap it up, undeterred by the €75 million price tag – a price far beyond Duffau-Lagarrosse’s means. Initially, it was a bidding war between neighbouring Ch. Angélus’s Stéphanie de Boüard and Clos Fourtet’s Matthieu Cuvelier. Then, however, the Courtin-Clarins family stepped in – and offered to partner with Joséphine Duffau-Lagarrosse. Joséphine met with Prisca Courtin-Clarins, Clarins CEO and the third generation to run her family’s cosmetic empire (which remains 100% family-owned). According to Duffau-Lagarrosse, they instantly hit it off and the synergy between them was obvious: two young, talented, ambitious French women. Duffau-Lagarrosse had all the technical know-how to make great wine, as well as a life-long experience of the estate.  Courtin-Clarins, meanwhile, had all the commercial experience and financial backing to help manage and develop the business side of the property. Joséphine invited Prisca to see the château and she loved it. Within a month of meeting, they had put in their own bid. With the family connection, their bid was favoured and the two of them became co-directors on 12th April 2021. Walking around the amazing labyrinth of limestone caves under the property (covering 650 square-metres), where Duffau-Lagarrosse now ages the wine, you can see how proud she is of her family estate and how excited she is for the future – now under her control. She admits that it all happened a bit quickly. After deciding to follow in her family’s oenological footsteps, she had deliberately stayed away from Bordeaux for as long as she could, knowing that her family ties would eventually pull her back. Born and raised in Pomerol after graduating, it wasn’t long before she was travelling around the world, learning to make wine in regions other than Bordeaux. Duffau-Lagarrosse has an impressive resumé, working under some of the world’s best winemakers. She worked with Ch. Margaux’s Phillipe Bascaules when he was at Inglenook in Napa Valley, before heading to Hawkes Bay in New Zealand to work on Bordeaux blends in a contrasting climate. Following her stint there, she went to Mexico to work on a project with famous Bordelais consultant Stéphane Derenoncourt, before returning to France and working in Burgundy with Maxime Cheurlin at Domaine Georges Noëllat – someone who had inherited an historic family estate at a similarly young age. Of all the vintages to take on such a legacy, however, 2021 was far from the easiest – a year that asked everything of its makers. “It was not easy,” she admits, a smile sneaking onto her face, “but I really enjoyed it.” As we tasted the 2021, we asked whether she’d had to chaptalise – a common practice in the year’s cool conditions. For a millennial born in the era of climate change, it was totally new to her, but she felt it was needed to round out the mid-palate. “So I called Burgundy,” she jests, a twinkle in her eye. Despite its challenges, Duffau-Lagarrosse is very pleased with her 2021 – the first full vintage under her lead – and as she should be. She certainly respects what previous winemaker, Nicolas Thienpont, had done with the estate over the last 12 years – consistently producing one of the top wines of the vintage. Without swerving away from his style, Duffau-Lagarrosse is still keen to put her own bent on the wine. Reducing the amount of new oak is perhaps the most obvious first step – although that is also understandable considering the vintage conditions in 2021. She is also keen to make sure extraction levels are very carefully monitored and this was particularly important in 2021. “We had to question everything,” says Duffau-Lagarrosse, but the challenges proved to be a fast-track for understanding the terroir she had inherited. And she wasn’t alone – hiring two of Bordeaux’s leading consultants, Axel Marchand (professor of oenology at Bordeaux University) and Julien Viaud (the co-owner of Michel Rolland’s consultancy, which according to Duffau-Lagarrosse, has a contrasting and complementary approach to Rolland’s philosophy of high extraction and high proportions of new oak). The new team is certainly one of the most exciting and positive developments in Saint-Emilion – especially given the recent tumult in the appellation. There is certainly a lovely balance to the Ch. Beauséjour Duffau-Lagarrosse in 2021, and the wine has captured the beautiful, scented perfume of vintage’s top examples. It’s a wine that shows the promise of this vigneronne and address – one that is set to compete with the very best in the appellation. The legend is safe in the hands of its rightful owner. It is little wonder there has been a veritable tequila gold rush, after celebrity-backed brands have sold in excess of $1bn, and the category continued to report double-digit growth during a global pandemic. This growth wasn’t just at the entry level – as some might expect – as online sales of reposado, añejo and extra añejo soared in tequila’s biggest market, the US. The thirst for premium-and-above tequila falls to 163 certified tequila-producing companies and 8,000 agave producers, which is not as easily sated as some might think when your agricultural product takes years to mature in the ground and in barrel. While category growth is undeniably cause for celebration, artisanal producers like Clase Azul are struggling to meet demand. Production is so time and labour-intensive that, with increasing popularity, Clase Azul is considering an allocation model in the UK, as already employed in other markets. The brand’s distinctive hand-painted decanters take two weeks to produce, made by local artisans from the Mazahuas, in the town of Santa María Canchesdá. Before bottling, the organic, non-genetically modified Blue Weber agave takes nine years before it can be harvested, 72 hours to cook, and the Reposado and Añejo are both aged in ex-Bourbon casks for eight months and 25 months, respectively. Clase Azul Ultra – their top tequila – is aged between five and seven years in ex-Sherry casks, making it a popular choice for whisky lovers. Founder Arturo Lomeli is adamant he doesn’t want to streamline any of this process and compromise on quality. “In terms of the quality," Chantal Serrano (Prestige Account Manager for Spirit Cartel, the company's UK distributor) explains, "if you really want to have real agave quality with all the certifications – organic, non-genetically modified – there’s going to be a point when you are limited.” Clase Azul already has a Mezcal offering that is made from wild, 12-to -15-year-old Cenizo agave which can only be harvested once a year. The Cenizo is slowly roasted using firewood and volcanic rock, then milled by hand using an axe. Next it is fermented using stone piles with red oak and double-distilled using an alembic copper still known as El Viejo.   Premium-and-above tequila has been reporting double-digit growth for the past five years, but some still do not afford it the respect it’s due, according to Serrano. “I think if you told some of the biggest producers of Cognac that you were going to shot it, then I think they will be scandalised. Tequila might not have been aged in a barrel for as long as some whiskies, but the plant had to mature at least on average for five to seven years and, for some producers, like Clase Azul, it is nine years, so appreciate that.”  It is increasingly difficult for producers to have this conversation with consumers when some companies are being forced to cut corners to meet the seemingly unquenchable thirst for all things agave. The use of diffusers to process, in many cases raw, agave piñas so the sugars can be fermented and distilled more quickly has become a popular way of circumventing the challenges. While diffusers are undeniably effective in extracting the potential fermentable sugars – 99% to the traditional brick oven and tahona method’s 70% – the change in flavour profile is not always a favourable one.   “The only objective is to extract as much sugar as they can from the agave,” Serrano laments. “And I can sort of understand why they do it because there is such a huge demand… but you then sacrifice quality.   “Unmatured agave or very young agave is being used in the production of these diffusers. Even some chemicals will be used sometimes. Because of the whole process, certain bitter flavours will be there that ideally need to be removed so you potentially even add some flavours to make it feel like it was a real product.”  For Serrano, the two products are like day and night. “You cannot compare [diffuser products] to a product that has been aged for many years. The producer took the financial risk of having that capital sitting there and waiting for it. It takes a lot of time to create a good product, but that is also the beauty about it.”   The involvement of celebrities in the industry has done wonders, shining a light on the category – but it can also confuse consumers, according to Serrano. “Because Clase Azul is a luxury product, a lot of people think we are just focused on the marketing and the image,” she says. But the company is focused on much more than branding, with a clear commitment to its community.  Clase Azul was set up by Guadalajara-native Arturo Lomeli after he identified a gap in the market for a higher-end tequila to be sipped and savoured, much like a whisky or Cognac. Lomeli favoured the fruitier, sweeter and floral notes a Highland tequila imparts versus the typically peppery, spicy and vegetal notes from the valley (Lowlands). As such, he set up shop in Jésus María, a small town near Arandas – one of the highest points in the Jalisco highlands.  Clase Azul is in esteemed company with a Positive Luxury Butterfly Mark for its sustainable efforts. Glenmorangie, Macallan, Château d'Yquem and other luxury drinks brands boast the same. In addition to reducing its plastic and water use, the decanter can be upcycled, and Clase Azul tries to work with fair labour providers and sub-contractors. “Clase Azul try and implement all these measures with the same aim of giving something back and being a bit more responsible as a brand,” Serrano adds.   Sustainability has become increasingly important as drinkers increasingly consider a brand’s environmental impact as part of their buying decision. While this is something that is encouraged by many producers, it can lead to some slightly less robust claims in the industry, according to Serrano.   “It can be frustrating because some brands might say, ‘Oh we do give back to our community or a charity, or we do one specific action and they think look at us we do a lot of sustainability,’” Serrano says. “Whereas, for me, Clase Azul really embodies these values. Arturo Lomeli, from the start, wanted to give something and be sustainable. It was not just a trend and he thought ‘let me do it’. He’s been doing it almost from the beginning with the brand.”  The demand for aged, sustainable tequila is clear and Clase Azul is well positioned to go toe-to-toe with anybody in a battle of style versus substance.   Discover more about Clase Azul or read more Editorial

Humble yet with undeniable ambition, Jacques Devauges arrived at Domaine des Lambrays in March 2019 and has wasted no time in making small but significant adjustments at the estate. His appointment was the most recent in a flurry of changes that have made waves in the quiet of Burgundy, after the property was purchased by LVMH in 2014 for an undisclosed sum – the luxury group’s first foray into Burgundy.    While the first mention of “Cloux des Lambrays” dates back to 1364, it was really in the 1980s that its modern reputation was established. The vineyard had fallen into disrepair, but was bought by Roland de Chambure and the Saier brothers in 1979. They installed Thierry Brouin as winemaker and director, together restoring the property to its former glory. Thierry, in Devauges’s words, “rejuvenated” the estate – staying at the helm for 38 years, overseeing the property under three different owners before finally retiring in 2017.  Boris Champy had already been lined up to take over, but stayed a mere two years before Devauges was poached from Clos de Tart (where he’d been since 2015, previously Domaine de l’Arlot). In the humdrum of Burgundy, Champy’s sudden departure was big news – as was Devauges’s sudden arrival, although everyone has remained suitably tight-lipped on the topic.  While Domaine des Lambrays does own some village and Premier Cru Morey-Saint-Denis, as well as some Puligny-Montrachet Premier Cru, the domaine’s reputation is inextricably entwined with that of the eponymous Clos des Lambrays. This remarkable site – one of Morey’s five Grands Crus, along with Clos de la Roche, Clos Saint-Denis, Clos de Tart and Bonnes-Mares – was originally classified only as a Premier Cru. It was only in 1981, under Thierry Brouin’s tenure and significant work in the vineyard, that the site was rightfully upgraded – making it the last of Burgundy’s 33 Grands Crus to earn its status.  Such is its association with the domaine that Clos des Lambrays is often mistaken for a monopole; however it isn’t quite. One ouvrée – less than 0.2 of the total 8.84 hectares – at the bottom of the clos belongs to Taupenot-Merme. Originally a vegetable garden, it was planted with vines in 1974, and produces a tiny amount of wine (no more than one barrel in the most generous years).   Visiting in October 2020, it was clear that Jacques Devauges has big plans – and if 2019 is anything to go by, there is much to look forward to. Coincidentally, Devauges wasn’t new to the estate – having worked briefly in the winery under Brouin in 1997. He’s full of praise for Brouin’s work and clearly wishes to respect the enormous legacy he’s been handed. His aim, however, is to recreate the old Domaine des Lambrays of the early 20th century – before the vineyard fell into disrepair in the 1930s.  There have already been a few shifts, with the construction of a new winery underway and 2019 the first fully organic vintage, and the property – as of 2020 – in conversion to biodynamics. This is no small feat given some of the site’s peculiarities. After phylloxera, the vine rows were planted north to south, perpendicular to the slope. This is an angle that little machinery can handle (with a serious risk of toppling over) and as such almost all the work here has to be done by hand, however Devauges has had a special tractor made that can handle the site’s undulating terroir. A relatively large site, it’s unsurprising that the soils here vary. While broadly speaking it is a rocky clay, the bottom of the site is heavier clay and loam, while the midslope is more gravelly over deep limestone, and the very top has shallower limestone soils. As he gets to know the Clos, and differences between each sub-parcel, Devauges is vinifying each one separately, laying the barrels out in the same way as the vineyard – so he can figuratively walk the rows, identifying the character of each. For Clos des Lambrays, he has divided the site into 10 sub-plots (see the map below), however he identifies three major sections of the vineyard: the section near Clos de Tart, the middle and then the side closer to Clos-Saint-Denis.  Tasting three components of the vineyard separately, and then together, with Devauges was enlightening. First up was La Plante Dessous, on the Clos Saint-Denis side, home to some of its “youngest” vines – which are still 40 years in age. The wine produced here is tight and intense, building gradually in the mouth with silky tannins and an amazing purity of blueberry and blackberry fruit. Cerisier, a plot at the bottom of the slope near Clos de Tart, is drastically different. This is full, exotic, rich and ripe – yet with a real freshness and a chalky minerality beneath. The final section we tasted was 80 Ouvrées Dessus – right at the top, middle part of the vineyard. Angular and structured, it showed remarkable energy and intensity – a core of vibrant blue fruit and firm tannins. In the resulting final blend, you can feel every element – except with the dial turned up to max.   Unlike Brouin, Devauges feels it is important not to select the best barrels, and “blend” a wine, but to seek “as much truth as possible”. While he is declassifying the very youngest vines (those under 20 years in age) to their Premier Cru bottling, he feels that they have a responsibility to capture the site in its entirety – using whatever nature provides. “Here, we are farmers,” he says modestly, with a suitably Gallic shrug. The resulting wine is the one true expression of this site – and that’s clearly where Devauges’s focus lies, something that will doubtless evolve in the coming vintages. “Every year is a new page,” Devauges told us. When visiting the cellars of Domaine Hubert Lamy, you are likely to come out a lot wiser than you were when you went in. Olivier Lamy has been experimenting ever since he joined his father at the domaine in 1995, and he loves to share his findings.  On our last visit we were given two white wines blind and asked to assess them. One thing seemed immediately clear: with its deeper colour and more developed savoury tones, one wine was older than the other. “No” he replied. “They are the same age.” Okay, perhaps the reason for such variation in development is due to the wines coming from two different quality sites – a Grand Cru versus a village wine for instance? “No, it is the same vineyard,” he replied. Perplexed, the only other solution I thought must be his high-density plantings. (Olivier has planted parts of his vineyard three times the density of the norm in Burgundy, with up to 30,000 vines per hectare), the result being smaller, more flavourful berries. Wrong again.   “Wrong experiment,” he smirks, leaving us completely stumped. He presents the two bottles and the answer lies with the capsules. Both wines have the same cork closure but one has the traditional metal capsule seal, the other bottle has been dipped in wax. It is the wax capsule that seems not only younger and fresher, but more texturally complex, yet both the wines are from exactly the same vineyard, with the same vine density and vintage. It is simply the closure that has preserved one wine so much better.   Olivier has been experimenting with closures for years. There have long been concerns about natural cork, with the risk of cork taint top of the list of potential problems, but it was the issue of premature oxidation, particularly with white Burgundy, that led Olivier to investigate whether maybe the problem lay with the closure.  Despite the drop in natural cork’s popularity and their replacement with alternative, “technical” corks and screwcaps, the natural cork still has plenty of advocates, and it remains the most sustainable and natural of solutions for many. A better understanding of the causes of cork taint has vastly improved the natural cork’s reliability and reputation, yet “being a natural product there remain irregularities in the cork,” says Olivier. Natural cork is irregular in structure, therefore allowing different levels of oxygen ingress, meaning that the same wine can mature differently depending on the specific cork, and resulting in bottle variation.  Olivier also believes the irregularities of cork have become worse in recent years due to climate change, with the warmer temperatures resulting in even less consistent cork.  The benefit of the wax capsule, according to Lamy, is that it acts like a “bandage”, offsetting the irregularities of the cork. His grandfather and many other winemakers often used wax capsules for wines destined for their personal cellars; it was the reliable ageing capacity of these wines that prompted his experiments. Trialling the effects of waxed and unwaxed capsules since 2009, he decided to use wax capsules on all his wines in 2016. Over this time, he has experimented with varying diameters and lengths of cork, different treatments, as well as testing plastic, agglomerate, and technical corks before concluding that longer (54mm), technical DIAMs (a natural cork-based agglomerate closure), under wax seal produce the best results and best protect against premature oxidation.  Does this mean we have a definitive answer to the question that has plagued white Burgundy for the last couple of decades regarding premature oxidation? While his experiments certainly seem to imply that the irregularity of natural corks could be one of the biggest culprits and wax capsules one of the most successful solutions, he does not believe it is only the cork which is at fault. “There are two problems,” he says. “Poor-quality corks and the fact that wines are more fragile these days.”  The increased fragility of white Burgundy, Lamy believes, is a modern phenomenon. Climate change produces riper grapes, combine this with too many new barrels, modern presses that are too protective and you have wines that are more susceptible to oxidation. All too aware of this concern, many vignerons, Lamy believes, attempt to overprotect their wines, adding too much anti-oxidative sulphur dioxide (SO2) throughout the winemaking process. Counter-intuitively, this in fact makes the wines more susceptible to oxidation. When wine is made in a more protective environment, the more volatile phenolics remain in the wine, whereas these will drop out of a wine  when it is made oxidatively at the early stages of vinification, resulting in a much more stable wine.   Despite vignerons’ better understanding of the effects protective winemaking has on long-term ageing, these techniques are still used by many because it makes the wines so much more approachable in their youth. Many white wines today are built on developing these youthful aromas at the expense of ageing potential, Lamy argues. This is, he says, is in direct contrast with the past, where wines were built on texture, remaining fairly closed in their youth, with the aromas only developing with age.  There are still many traditional vignerons in Burgundy producing textural white wines built to age – with Lamy (who does not enjoy young, aromatic Burgundy) being one of them. With the warming climate, he has, however, had to adapt his winemaking to protect these more fragile wines. These days he manages the press cycle according to the vintage and allows for more solids when required.  With all the wines now bottled under DIAM and wax capsules, all Lamy can do now is wait. But, if his experiments are anything to go by, the risks of premature oxidation are low. Of course, he’s not sitting back – the dynamic winemaker is looking to experiment even more, pushing the boundaries to produce the best, and most age-worthy, wine possible.
