Few names generate as much excitement as Karuizawa in the whisky world. In recent years the lost Japanese distillery – which was only ever in operation for 46 years and was scarcely known outside of its domestic market during that time – has become an icon and collectors’ golden goose.  One of the reasons for Karuizawa’s astonishing collectability is its genuine scarcity. The Japanese distillery will never produce any more whisky. After lying dormant for well over a decade following its closure in 2001, anything that remained was demolished in 2016. This, coupled with the fact Karuizawa was one of Japan’s smallest distilleries, with a miniscule output, means there weren’t huge volumes of stock left when production ceased. But just how did this niche Japanese whisky become so valuable? And which Karuizawa whiskies should be on any serious collectors’ wish list? The history of Karuizawa When the Karuizawa Distillery was built in Miyota in 1955, the owners set out to create a Japanese whisky in the Scottish tradition. In the mid-1950s, that meant Sherry-aged whiskies like The Macallan. As such, the distillery used small stills and Sherry butts that were modified to fit the wine racks that had previously been used on the site when it operated as a winery. Karuizawa also imported 100% Scottish barley (from 1994, exclusively Golden Promise – a richly flavoured spring barley variety). Like Scottish distilleries, Karuizawa initially produced whisky for the sole purpose of blending. It wasn’t until 1976 that Karuizawa produced its first single malt.  The Karuizawa distillery was mothballed in 2001 when its owners Kirin Holdings – who had invested heavily in its wine enterprise – could no longer maintain whisky production. Karuizawa and its sister distillery, Kawaskai, closed for good 10 years later. In 2012, all the Karuizawa distillery equipment, including the stills, were sold, and anything that remained was demolished in 2016.  The distillery is named after the town, Karuizawa, which is just under two hours by train northwest of Tokyo. Until 2022, Karuizawa was the only town to have hosted both the summer and winter Olympic Games events (1964 and 1998 respectively). 

 What is so unique about the Karuizawa distillery location? The location of the Karuizawa Distillery was unique for a number of reasons: firstly, it was on the side of an active volcano, Mount Asama – which meant the water source was incredibly pure. It was also the highest Japanese distillery, so the temperature remained constant at 10˚C and humidity averaged 80%. The misty surroundings encouraged water evaporation before alcohol, resulting in highly concentrated and high-alcohol older whiskies (30- to 40-year-old whiskies at approximately 60% alcohol). Karuizawa distillery character The Karuizawa distillery’s extraordinary location, on the southern slopes of one of Japan’s most active (category A) volcanoes is credited with creating the unique characteristics of the single malt. The cold, snowy winters and summers with up to 80% humidity, created specific atmospheric conditions that were ideal for whisky maturation. The resulting liquid had the enviable ability to age gracefully for many decades, while retaining an abnormally high alcoholic strength and concentrated, complex flavour.  Karuizawa boasted a twin pair of small 4,000-litre stills and wooden washbacks. When the distillery closed in 2001, Shizuoka Distillery owners Gaia Flow bought both the stills and have only been able to successfully bring one back to life. 
 Karuizawa’s rise in popularity It might be easy to forget given Karuizawa’s current notoriety but very few people had heard of the distillery when it closed its doors in 2001. The distillery’s cult-like status is largely thanks to Englishman and former Whisky Magazine Editor Marcin Miller’s foresight. Via his company, Number One Drinks, Miller and his business partner David Croll became the sole distributor of Karuizawa, Chichibu and Hanyu in the early 2000s after purchasing the last 364 barrels.  When Miller and Croll bought the remaining Karuizawa stock after protracted discussions, the world was only just starting to take notice of Japanese whisky. After a smattering of awards for the likes of Nikka in prestigious tasting competitions, all eyes were on Japan by 2015, when Jim Murray named Suntory’s Yamazaki Sherry Cask 2013 the world’s best.  Smack bang in the middle of this, in 2007, the first single-cask bottlings of Karuizawa started to be released in Europe, opening a floodgate of Karuizawa appreciation and secondary market prices that hadn’t previously been seen.  After tiring of seeing Karuizawa bottles flipped and sold for exorbitant amounts, Miller handed over Number One Drinks’ remaining stock to the influential Taiwanese whisky collector Eric Huang in 2011, making him the largest holder of Karuizawa casks in the world. Huang was reportedly in possession of 20 casks in 2018, with other holders owning five casks between them.  One of these owners, renowned collector Mahesh Patel, chose to bottle The Legend of Asama series from his two casks in 2021. Patel’s casks (#4059 and #6183) were both distilled in 1981 and matured at Karuizawa for 20 years before they were moved to Chichibu Distillery and bottled in 2017. Prices for one two-bottle set of The Legend of Asama were in excess of £100,000. There is still some maturing Karuizawa stock that remains unbottled.  Karuizawa lives on: Komoro distillery Karuizawa is one of the whisky world’s truly lost distilleries, with no hopes of resurrection. But, there has been chatter about a new distillery on or around the site for years.  In 2020, it was announced Karuizawa Distillers, spearheaded by Karuizawa locals Koji and Yoshie Shimaoka, would build Komoro Distillery near the original location. The distillery construction has begun and should be completed by December 2022, with spirit flowing in early 2023. When it comes to the liquid, former Kavalan Distiller and Blender Ian Chang will head up production. Chang wishes to employ a number of the late Dr Jim Swan’s techniques at Komoro, including STR – shaved, toasted and re-charred red wine casks. Mizunara casks are also rumoured to be high on the agenda.   There is also keen interest in Shizuoka Distillery, whose owners Gaia Flow salvaged the stills from the original Karuizawa site.  Record-breaking prices In March 2020, a bottle of 52-year-old Karuizawa became the world’s most expensive Japanese whisky sold at auction, fetching £363,000 at Sotheby’s in London. A private collector paid roughly twice the pre-sale estimate for one of only 41 bottles in existence of Karuizawa 52 Year Old Cask #5627 Zodiac Rat 1960. In 2022, a 250ml bottle of Karuizawa 1960 47-year-old whisky sold for more than triple its estimated sale price at almost $160,000. While the 1980s is heralded as something of a golden age of whisky production at the lost distillery, due to the scarcity of liquid, anything put up for auction is likely to sell for a record-breaking sum.  The early releases from the Japanese distillery were very minimalist. When Karuizawa 42 Year Old (1967) Cask #6426 was first released, it was sold in a glass bottle complete with a white sticker label encased in a thin cardboard box. Initially released for £250, this bottling would later fetch in excess of £20,000 on the secondary market. Today, the most high-profile releases of Karuizawa are collected and displayed like works of art. Bottlings have become more and more beautiful – and elusive. Most are now sold via a ballot. Some of the most notable Karuizawa collections include the Karuizawa Fight Club Collection, Ghost Series, Thousand Arrows and Samurai collection.  The Karuizawa Geisha whiskies Geisha is one of the most recognisable and coveted series of Karuizawa whiskies. Each release of the two-set Geisha series has been met with unfettered excitement. To date, limited sets containing whiskies aged for 29, 30, 31 and 50 years bottled in the 1970s, ’80s and ’90s have been released.  The Geisha bottlings are iconic and collectable for the intricate nuances inside and outside the bottle. The first pair of Geishas (a Bourbon-matured 30-year-old and a Sherry-matured 31-year-old) were released in 2013. This is the only set to feature more than just the Geisha’s face on the bottle. One year later, a 29-year-old and 30-year-old set, named the Aika Geishas, was released. The Geisha’s mirror image graced these bottlings. The Karuizawa Golden Geishas (31- and 33-year-old) were the next in the series, followed by The Emerald Geishas (33- and 35-year-old). In 2018, The Murasaki Geishas, AKA Imperial Purple, were released. Only 60 bottles of each expression were allocated by ballot for £6,000 each. Two years later, another two Karuizawa Geishas known as The Sapphire Geishas were unveiled: a single-cask 31-year-old and 36-year-old. The Pearl (37- and 38-year-old), Sapphire (31- and 36-year-old), and Ruby (34- and 38-year-old) complete the collection.   Karuizawa Noh collection The NOH collection is one of the largest and most popular series of Karuizawa whiskies. Each one of the single cask expressions is incredibly highly sought-after. It is a rare occasion indeed when an entire collection becomes available. A couple of years ago, I wrote a book called Time Tamed. In retrospect it is an ambitious title. Even at the time I realised as much, describing man’s efforts to tame time as being a task as Sisyphean as it is Canute-like. Humankind invented time to make sense of the world around us. It can be argued that an understanding of time – and the ability, however rudimentary, to track it and act according to it – is right up there alongside the ability to fashion tools and communicate using spoken language, as one of the characteristics setting humans aside from the other species with which our planet is shared. In the beginning at least, the extent of our relationship with time was a cognitive reaction to phenomena that permitted the prediction of cyclical seasonal events such as the migration of animals, and later forecasting the effect of variations in terms of temperature and daylight hours on the flowering and fruiting of crops.   The triumph of human intellect, and the beginning of our species’ march to its position at the apex of life on our planet, was to make conscious use of this intellectual edge that allowed us to benefit from the recurring patterns of events foretold by observation of such astronomical phenomena as the rising and setting of the sun, the waxing and waning of the moon, and the lengthening and shortening of the diurnal span. Lunar phases repeat themselves in a cycle of 29½ days; the tropical year as measured, say, from winter solstice to winter solstice (when the day is shortest and night longest) is approximately 365¼ days. The interaction of the solar and lunar calendars, providing, respectively, the year and the 12 months in it, gave us the framework upon which to build civilisation. “If time was conceived as the precise measure of an ordered succession of states, it should come as no surprise to find that its first criterion of measurement in every known civilization should have been the movement of the stars (which is both movement and return, in other words a ‘constant periodical appearance’)”, wrote Umberto Eco. He next posed the rhetorical question: “Even if there were nothing more to time than this, it would still be interesting to ask why, for so many centuries, men measured out the years, the months, and the days, but came so late to measuring hours and minutes. The main stumbling block was the need for mechanically precise instruments to measure them.” Calendars of varying degrees of sophistication have been in use for millennia. In my book, I wrote about a series of 12 fire pits in Scotland that – in conjunction with the known location of sunrise through a mountain pass on the morning of the winter solstice – functioned as a calendar in the Mesolithic period, 10,000 years ago. Compared to that, widely available accurate timekeeping is only a relatively recent phenomenon. Had you asked a medieval peasant the time, he would have probably told you what season it was and, as recently as the mid 19th century, time was measured according to local meridians that gave a local solar noon. Britain, at the time the world’s preeminent industrial power, only got its first real taste of unified national time in 1851, when millions visited the Great Exhibition, travelling from all corners of the Kingdom by trains that ran to a single national time. But in the last couple of centuries the pace has hastened: we have become, as Eco put it, “children of a clock civilization”, and I am sure there are those who would argue that it is from there that many of our problems have arisen.   The industrialisation of time was of particular interest to Karl Marx. “The clock is the first automatic machine applied to practical purposes,” he wrote to Friedrich Engels in 1863, “and the whole theory of production of regular motion was developed on it.” Even though abstract, time had become the ultimate economic commodity. Life became lived according to the maxim ‘time is money’ and with a Gradgrindian myopia we have concentrated on ever smaller divisions of time until we have become not children but slaves of the clock. Time was never tangible, but in the past it linked human experience to the cosmos through the tracking of solar and lunar cycles. The division of time into units that are independent of astral cycles has distanced us from the natural rhythms of life. Division of time into small units standardised around the world has facilitated the synchronisation of activities that enable us to live in our modern world of ‘just-in-time’ production, conurbations with populations of millions, and a network of integrated transport systems that allow us to travel from one side of the world to the other well within the span of a single day. It has taken the recent and as yet unresolved upheaval wrought upon our carefully organised world by the COVID-19 pandemic to reveal the humbling fragility of the system by which we live and regulate our lives. Moreover, one could argue that it is the application of monetised time that is responsible for the ravages that we have perpetrated on our planet in pursuit of our industrial goals. But before we blame the rise of the timepiece for the ills of the world, there is an aspect to watchmaking that can enable us to reconnect with the cosmos in a way that is familiar to those conversant with the world of biodynamic winemaking. So, when the editor of FONDATA suggested biodynamic winemaking as the prism through which to view watchmaking, I was intrigued. Once upon a time, a long time ago, I did work in the wine trade. However, we parted company during the 1980s, some time before biodynamic winemaking became what I believe is called ‘a thing’. Obviously, all readers of FONDATA understand the basic principles of biodynamics, but I needed to undergo a quick crash course in what is just one of the legacies of the quite extraordinarily colourful and at times controversial Rudolf Steiner; the late 19th- and early 20th-century Austrian philosopher, social reformer, writer, educationalist, editor, architect, spiritualist, scientific spiritualist, mystic, Goethe superfan, campaigner for the independence of upper Silesia – and much more besides. He came up with everything from a new, quasi-religious movement called ‘Anthroposophy’, to a new approach to medicine; a new artform, ‘Eurythmy’, to a new form of agriculture, ‘Biodynamics’. Steiner turned his fecund and agile mind to the problem of agriculture in the early 1920s and addressed many of the concerns that we are still grappling with a century later, advocating a sustainable ecologically-oriented approach to farming that eschewed chemical pesticides and fertilisers in favour of natural alternatives and conducting agriculture based on an astronomical and astrological calendar. Steiner is memorable because he could enliven even the relatively practical activity of growing things with woo-woo mumbo jumbo of a level to which even Gwyneth Paltrow can only aspire: for instance, burying manure in a cow horn over winter and then exhuming it; or controlling infestations of field mice by sprinkling fields with the ashes obtained by burning the skin of a “fairly young mouse” obtained “at a time when Venus is in the sign of Scorpio”. And yet, such was the power of his way of thinking that it would be wrong to characterise him as a total crank: Steiner was apparently taken seriously by Hitler as a threat to National Socialism.  But back to wine. Prima facie, there is little to link the joyous celebration and bounteousness of viniculture with the mechanical slicing of hours into minutes, into seconds into milliseconds. However, to view watchmaking as being just about the business of telling the time is to underestimate what is in my opinion one of the most engrossing areas of human ingenuity and creativity, where science, mathematics, mechanics and art meet. I like to think about watchmaking as being connected to the detection and calibration of rhythms and patterns … biodynamic farming is all about rhythms and patterns, especially those of the lunar calendar. In his writings, there are times when Steiner could be writing the script for Star Wars – when he talks of entering into “the forces that regulate growth, crucially the ‘fully-evolved Moon-force’”.  The Biodynamic Association uses less picturesque language to summarise the approach, saying that the philosophy of biodynamic farming is founded on “the influences of the moon, planets and constellations on plant growth”. “Each month the moon moves through all twelve constellations of the zodiac in turn. This is referred to as the moon’s sidereal cycle and forms the basis of the biodynamic calendar. Although the waxing and waning (synodic) cycle is the most well-known lunar rhythm, it plays a small part in this calendar.” The indication of moon phases has long been a feature of watchmaking, and even if knowing whether one is living under a waxing gibbous moon is not of primary importance to most of us, the function is undeniably decorative when artistically transferred to a watch face – the moon disc, often decorated with a background of stars, making a complete rotation once every 29½ days. Watches with more advanced astronomical functionality feature sidereal time as well. And this year, the long-established watchmaker Jaeger-LeCoultre demonstrated that it is capable of getting seriously cosmological. To celebrate the 90th anniversary of its famous Reverso model, it released the world’s first four-sided watch, the Hybris Mechanica Quadriptyque. As its name suggests the Reverso flips over to reveal its back. Initially conceived as a protective measure, more recently the back has been used to display other information (another time zone for instance). Now, the cradle in which the watch sits on the wrist has also been mechanised to offer two further planes for display – much in the way that one can connect multiple screens to a single computer rather than having to be constantly opening and closing windows. And Jaeger’s watchmaking wizards have turned faces three and four into a banquet of lunar information.  On the interior face of the cradle there are three displays giving the synodic cycle in the northern hemisphere, the draconic cycle (the height of the moon) and the anomalistic cycle (apogee and perigee, when the moon is respectively furthest from and nearest to the Earth), while the fourth side of the watch gives the synodic cycle in the southern hemisphere.   It sounds like an observatory on the wrist and according to the makers: “the Hybris Mechanica Quadriptyque can predict the next global incidence of astronomical events such as supermoons and eclipses – the world’s first wristwatch to provide such a deep reading of the cosmos.” I imagine even Steiner would be impressed especially as in biodynamic circles cosmological connections are crucial. Biodynamic agricultural activity is governed by knowledge of the behaviour of celestial bodies: ascending moon days favour certain agricultural activities while other tasks are better performed on descending moon days. Eclipses, apogee, perigee, and new moons all have their associated agricultural messages for the biodynamic farmer.   “It’s connected into the cosmos,” explains Philippa Hegarty of Hegarty Chamans, a vineyard in the foothills of the Montagne Noire in the Minervois. “We find an explanation that people respond to is; if the Moon has such a strong tidal influence then it can certainly move sap up and down a vine and that’s what we work with at different times of the year.” Providing timing of the movement of the tides is another function that the mechanical clock or watch can perform; indeed it is one of the oldest, predating the minute hand, the second hand, the wristwatch and even the pocket watch. The provision of times of high tide by a mechanical timepiece can be traced back to the 14th century and the famous Astronomical Clock designed by Richard of Wallingford, Abbot of St. Albans – which as well as showing the fixed stars and charting the movements of the sun and moon (complete with ecliptic nodes – another important feature for biodynamic winemakers) gave the times of the tides at London Bridge.   In fact, the technical leap forward accomplished by clockmakers in the 14th century rivals that of computer networks in our own time: at the end of the 13th century time was still being told by clepsydrae (like an hour glass but with water instead of sand) and by the middle of the following century, man was mapping the cosmos using mechanical machines of unimaginable complexity. If Giovanni de Dondi’s Astrarium of 1364 looks a little like a lunar landing module, then that was not the only thing it predicted. About a metre high and standing on protruding feet, the Astrarium featured seven panels with dials that showed the movements of the sun, moon and the then-known planets: Mercury, Venus, Mars, Jupiter and Saturn. Further dials indicated dates of fixed and moveable religious feast days, the intersections of the solar and lunar orbits, and time of sunrise and sunset. In comparison, the 24-hour clock seems prosaic, almost otiose. Another common feature of these miracle machines of the Middle Ages was the zodiac. Rather than being relegated to the horoscope section of the tabloid press, astrology was as much of a science as astronomy, and a medieval megaclock could not take itself seriously without a dial or two depicting the signs of the zodiac. The celebrated Three Kings Clock of Strasbourg Cathedral was no exception. As well as its astrolabe dial, ecclesiastical calendar, carillon mechanism that filled the air with religious music, and the automata that replicated the nativity, an illustrated panel linked signs of the zodiac to body parts, connecting human health with the movements of the celestial bodies, thus indicating propitious or hazardous times for that key medical procedure of the times: bloodletting. The influence of the zodiac constellations is an important part of the biodynamic playbook. “Since ancient times the twelve zodiac constellations have been associated with each of the four elements: earth, water, air and light,” observes the Biodynamic Association. “Three constellations are connected to each element, and each element is related to a part of the plant: thus, Earth – root; water – leaf; air – flower; fire – fruit.” “For example, for sowing or harvesting carrots, an earth – root day should be chosen; for lettuce, a water – leaf day; for beans and apples, a fire – fruit day; and for flowers and broccoli, an air – flower day.” As the example of the Jaeger-LeCoultre Hybris Mechanica Quadriptyque shows, thanks to the technological advances that have accrued during the last 20 or 30 years, the miracle of modern mechanical watchmaking is that it is able to miniaturise cosmological functions and place them on the wrist. Recent years have seen some truly spectacular wristwatches enter the market. Patek Philippe’s double-faced Sky Moon Tourbillon is regarded as one of the trophies of modern watchmaking: featuring minute repeater with ‘cathedral gongs’; tourbillon; perpetual calendar with retrograde date hand; day, month, leap year in apertures; hours and minutes of mean solar time; moon phases; and on the reverse, moon-focused watch face, sidereal time, sky chart, and phases and orbit of the moon. Van Cleef & Arpels caused a stir when it released a watch that condensed the workings of a planetarium onto the wrist with a watch charting the movement of the five planets visible to the naked eye from Earth: Mercury, Venus, Mars, Jupiter and Saturn; each planet orbiting on its own disc in its real rotation time. Blancpain, meanwhile, has tackled the notoriously complex lunisolar Chinese calendar to create a watch that displays the ten celestial pillars, the five celestial elements, the phases of the moon, the animal associated with the year and the date as given by the Gregorian calendar. I am neither watchmaker nor winemaker, but given the approaching centenary of Steiner’s 1924 series of agricultural lectures which gave birth to biodynamics, now might be a propitious time to consider a mechanical timepiece that displays the cosmological information pertinent to biodynamic viticulturists and farmers. Reports coming in last summer of the long drought that hit Burgundy had many writing off the vintage before it had even been picked. What then turned out to be the earliest harvest on record did nothing to calm those concerns. Many of the vignerons themselves were concerned about how the wines from this unique growing season would turn out. Preceding one of the most challenging seasons in the region’s history (2021 being beset with frost, rain, disease… you name it, it happened), everyone is looking back at 2020 and wondering what they were worried about. It is abundantly clear that 2020 produced some magnificent wines, with exceptional balance, freshness and full fruit maturity, yet that also remain very Burgundian in style. There is very little not to like. How it happened is a lot less clear, but we heard plenty of theories, that – while not completely consistent – go at least some way to explaining the vintage. While the vignerons don’t know for sure why the wines turned out the way they did, how they got there is by the by: these are extraordinary wines. Tasting the vintage While we tasted as many wines as we could up and down the Côte d’Or and beyond, due to the complications of the late 2021 vintage, some vignerons were still busy finishing off the harvest when we visited. The late harvest has also impacted the timing of winery work, delaying the racking process, meaning some of the wines weren’t able to be tasted or were in a slightly awkward place. While the breadth of tastings was therefore a little more limited than usual (with more analysis to follow), we still came away with a good hold on the vintage. On the whole, the wines we did taste were brilliant both in white and red, with a little more consistency among the whites. Pinot Noir struggled more with the drought, while the Chardonnay seemed almost unaffected. Despite the early harvest and slightly contracted growing season, both the whites and reds we tasted were fully phenolically mature. Even though the vines shut down due to the heat, there was no evidence of greenness at all. Some vignerons kept to the traditional 100 days between flowering and harvest – others were down to as little as 90-95 days, with some believing this to be the “new normal”. Benoît Stehly, winemaker at Domaine Georges Lignier believes that 2020’s drought had the same effect on the grapes you get when fruit is dried. “A dried apricot is both sugary and rich in acidity,” he says. “The dehydration of the berries concentrated the sugar,  flavour,  fruit and the acidity. It is the reason why the freshness of the 2020s is so good.” He contrasts it with 2018, another “hot vintage” but with more summer rain. “The alcohols were high and the acidity low in 2018 because the vines never shut down.” Bouchard’s Frédéric Weber echoed this. “The grapes’ maturity was stopped by the drought,  but this was positive, as there is greater natural acidity and natural freshness to the wines.” The expanded range at Alvina Pernot in 2020, a range of taut and mineral Chardonnays The whites The white wines we tasted were exceptional – with fantastic balance, great acidity and wonderful concentration, but moderate alcohol levels, when compared to the more exuberant 2019 and 2018 whites. So many vignerons were keen to point out the low pH levels and very high concentration of tartaric acid – reminiscent of the 2014s, but these wines have so much more flesh too, making them easy to enjoy already. They are less skinny and austere than the 2014s, yet have the energy and equilibrium to age beautifully. What is not to like? Guillaume Boillot at Henri Boillot highlighted the salinity and dry extract in the whites, making them “hyper dynamic and balanced”. He noted that the acidity is thanks to the vines shutting down – something which only happened to the Chardonnay. Frédéric Weber explained that the Chardonnay resisted the heat better, having very high tartaric levels and a pH that is the lowest since 2014 (at 3.1-3.2), creating classic wines. “The balance is perfect,” he said. As Olivier Lamy (Domaine Hubert Lamy) and Francine Picard (Au Pied du Mont Chauve) pointed out, the picking date was key for the whites, as the grapes were ripening very quickly – gaining around 1% potential alcohol in just two days. From our tastings, however, everyone seemed to get this right. Producers were particularly happy to have full cellars when it came to whites – with many coming close to the legal maximum in terms of production. Michel Pernot (Domaine Paul Pernot) feels that the generous yield was key to the fruit not being over-ripe, adding that in 2003 the yield was half of that in 2020 – and therefore overly concentrated and cooked. For Michel's daughter Alvina Pernot, it’s the best vintage she and her husband Philippe Abadie have made to date. Michel echoes the sentiment, saying it was simply “magnifique”. From what we’ve tasted, they’re excellent: vibrant wines that are a little more generous than 2014, but with brilliant precision and ageing potential. Amongst the vines in Chambertin Clos de Bèze The reds The variation in picking times for Pinot Noir emphasised how different parcels matured differently – whether due to microclimate, location, rootstock or access to water. It accentuated just how varied Burgundy’s landscape is, as well as vignerons’ own tastes. Charles van Canneyt (Domaine Hudelot-Noëllat) remarked that people were picking Pinot in the same vineyard up to a month apart. With moderate alcohol levels from all but a few producers, it certainly wasn’t racing sugar levels that forced an early harvest, but that the season started early and stayed so right through to harvest. It was down to the vignerons to dictate the style of their wines. In the Côte de Nuits, there were local rain showers in early August which Erwan Faiveley believes favoured the Pinot Noir particularly in Nuits-Saint-Georges, Chambolle-Musigny and Vosne-Romanée. This rain in early August, he believes, not only refreshed the vines but stopped the vines shutting down – helping with the phenolic development of the grapes and increasing the sugar levels, which resulted in higher alcohols, concentration and added freshness. Others around Vosne and Chambolle were grateful for a later rain shower on 28th August, which Lamarche, Hudelot-Noëllat, Gros Frère & Soeur and Georges Noëllat all believed was essential in pushing the grapes through to full phenolic maturity and providing the wines with added finesse. Again, the proof was in the pudding and the wines from Georges Noëllat, Hudelot-Noëllat and Lamarche were easily some of the finest we tasted. Up in Gevrey-Chambertin and Morey-Saint-Denis, the likes of Duroché, Tortochot, Georges Lignier and Domaine des Lambrays all chose to pick before the rain. Again, there was no concern here regarding greenness, with exceptional fruit concentration and clarity. Pierre Duroché believes his 2020s to be the densest wines he has ever made, but balanced with amazing acidity. It is certainly an exciting line-up. All in all, there’s more of a range in styles among the reds. In general, the fruit sits more in the red than black spectrum, bright and crunchy, with vibrant acidity and alcohol levels that tend to be closer to 13-13.5% (around 1% less than 2019 in many places). As Charles van Canneyt noted, it’s more classic than 2018 or ’19, while Nicole Lamarche praised the finesse and elegance of the year – something that certainly comes through in her wines. Producers are divided as to whether they prefer 2020 or 2019, although the majority consider 2020 the greater year. David Duband describes it as “fresher, straighter, more serious” than 2019, while Nicolas Potel (Domaine de Bellene) thinks it’s easily in the top five vintages he’s ever made, and will prove more homogenous than its predecessor. Cyril Audoin in Marsannay and Nicolas Potel both highlighted that it was a vintage that will always be open. While undoubtedly the wines have everything needed for cellar ageing – beautiful balance, silky tannins, vibrant acidity and the necessary concentration – they are already very appealing, and seem unlikely to shut down in bottle. So, how did producers adapt to the year in the winery? Guillaume Boillot said it was “easy” – and he wasn’t alone, especially in the wake of 2021. Due to the year’s dry conditions, the fruit was so healthy that vignerons didn’t even need to use a sorting table. Because the fruit was harvested in such hot temperatures though, many highlighted the need to pick only in the mornings and in some instances to chill the fruit overnight (as is commonplace in the New World, and becoming more so in Burgundy). Whether or not to use whole-bunch fermentation divided Pinot Noir producers (again). For some producers – such as Duband, Domaine de la Romanée-Conti and Dujac – whole-bunch is part of their style, and will use a high proportion every year. For others, there is debate. Cyril Audoin de-stemmed everything, feeling that the ripening season was too short in 2020 to allow for full lignification (ripening of the stems). Erwan Faiveley agreed, noting that the way maturity was blocked in the height of summer prevented the stems lignifying. On the other side of the argument, vignerons such as Benoît Stehly at Georges Lignier saw lignification in the stems as early as July and had no concern using them in the blend to add complexity. Even domaines known for not using stems – such as Fourrier – used up to 20% in their blends in 2020. For Fourrier, the aim was to absorb colour and tannin, and add a sense of freshness. The lower alcohol levels made the vinifications generally easy to manage, however the high level of tannin in the Pinot Noir required special care – with many, as for 2019, looking to extract more gently. Frédéric Weber at Bouchard reduced the maceration time to compensate, while Charles van Canneyt opted for more pump-overs than punch-downs. The natural concentration in the berries saw Domaine Georges Noëllat’s Maxime Cheurlin do everything he could to “make the wines thinner”. This meant a 10-12 day cold soak, less extraction and cooler fermentation temperatures (with a maximum 29˚C) – fortunately it worked and the wines remain remarkably ethereal. Vintage comparisons Many vignerons struggled to find a direct comparison for 2020. While the growing season is closest in character to 2003, there is almost universal agreement that the wines (both Chardonnay and Pinot Noir) taste nothing like the ’03s. The whites’ tartaric acid and pH levels make a nice comparison with 2014 but they have so much more richness too, which brings added impact. Frédéric Weber notes how despite the warmness of the year, there is tremendous terroir transparency from one vineyard to the next – a real signal for him of a great vintage. In this respect it resembles 2016, but with added concentration. “The Pinots from 2017 and 2019 are soft, aromatic, round and warm in the mouth,” he says, “but the 2020s and 2016s have tension, brightness and are full of energy.” Several noted the similarity in fruit clarity to 2015, but with added freshness. While some compare it to 1947, Nicolas Potel – a man with an encyclopedic knowledge of Burgundy vintages – finds it closer to 1966, with a little 2019. “Big, but with great balance,” he explains. While there’s no obvious precedent, producers agree that the wines have great ageing potential thanks to the rich tannins and high acidity levels. Yields and pricing While Chardonnay didn’t fare too badly in 2020 (making white winemakers in the Côte de Beaune particularly happy), Pinot Noir did suffer in the drought. Yields are therefore reduced by up to 40%, depending on the domaine. Of course, this seems like nothing to producers after the just-picked 2021 – where producers have been able to salvage as little as 20% of a normal crop. This does mean that most wines will be increasing in price this year, with around 10-30% estimated. With so little wine made in 2021, however, and the exceptional quality of 2020, this is a vintage that is hard to miss. Burgundy 2020: an exceptional year

BURGUNDY 2021: THE GROWING SEASON After three warm years, 2021 marked a return to the sort of weather traditionally associated with Burgundy – and all its challenges.  The winter was warm and wet – “too warm”, Frédéric Weber at Bouchard told us. He remembers finishing pruning in just a t-shirt in March. The vines started growing enthusiastically, with early budbreak, only to be struck by a cold spell at the beginning of April – as frost struck the whole of France. The nights of 6th, 7th and 8th April were devastating, especially 7th. Temperatures dropped to -8˚C in places – temperatures at which candles, helicopters and wine machines could offer little help.  
Images of the Côte de Beaune littered with a milky way of candles filled social media, and vignerons could do little but pray. For the early-budding Chardonnay, 80% losses were normal, with some producers in Chablis losing everything. The humid conditions, with snow falling, made matters worse – unusually this combination means that lower-lying village sites were less impacted than the Grands Crus (higher up-slope, where more snow fell). Indeed, if producers had lit candles (or “bougies”), the warmth melted the snow, which then froze and the buds were burnt by the morning sun – cruel retribution for trying to protect their livelihood. This severe, black frost (“le gel advectif”, as Florence Heresztyn explained) was savage – caused by a mass of cold air from Siberia. Chardonnay (and therefore especially the Côte de Beaune) was impacted more, as were any earlier-ripening Pinot Noir sites, such as Cazetiers or Combe au Moine. Candles can normally only increase the temperature by 2˚C, however some producers noted how a collective effort could make a difference – with a high-density of candles concentrated on an area. Erwan Faiveley had installed electric wires in their Bâtard-Montrachet and Bienvenue-Bâtard-Montrachet, as used previously in Chablis, which saved their crop in these plots, but other parcels were devastated. As Thibault Gagey of Louis Jadot noted, late pruning could help; one of their long-term growers in Bâtard-Montrachet pruned late and got a better crop, but the damage was still significant. David Duband reported how he also had issues in April with caterpillars which munched on the nascent buds. He had to hire five additional workers for a week to battle their hungry attack. The cold weather continued, with May cold and cloudy. Flowering at Bouchard began on 16th June, in wet and mild conditions that were perfect for oidium (powdery mildew) and downy mildew. Because the weather was so wet, mud prevented tractor access and at Bouchard they hired more people to spray by hand – a luxury not everyone could afford. Producers across the region spent their weekends during the summer spraying their vines when they could, with the disease pressure a particular challenge to anyone working organically or biodynamically. Edouard Confuron estimated he had sprayed four or five times more than in a normal year. There was some localised hail, with a storm in June causing damage in the north of Gevrey-Chambertin, especially in Les Champeaux, said Pierre Duroché and Olivier Bernstein.  
With the wet and cooler conditions, deleafing was important to open up the canopy, reducing disease pressure and exposing the fruit to much-needed sunshine. At Olivier Bernstein, Richard Séguin explained how they deleafed the fruiting zone and kept just one or two bunches per vine, removing any green bunches that remained at mid-véraison.  September saved the vintage, with warm, sunny and mostly dry conditions. With the tiny volumes, this was enough to ripen the fruit – Jacques Devauges at Domaine des Lambrays described it as Mother Nature evening the score, making up for what she’d taken in April.  Harvest dates varied quite significantly – starting from 10th September through to early October. Rain fell on 19th and 20th September, and producers were often divided between picking before and after this date. Generally producers started with Pinot Noir, then moved onto the Chardonnay, and dates were around a month later than in 2020. Jean-Marie Fourrier felt it was important to wait for phenolic maturity – which only arrived after the rain, and Erwan Faiveley argued that it was essential to wait for the dilution from the rain to pass before picking. Given the low yields, the harvest was often shorter – simply because there wasn’t much fruit.  Selection was essential – making a small crop even smaller – but there was some beautiful fruit of both colours. Yields varied, with losses between 50 and 80% – and some parcels (especially of Chardonnay) were blended together due to the tiny volumes at play. BURGUNDY 2021: THE WHITE WINES 
There’s no doubt amongst producers – or tasters – that this is an excellent vintage for Chardonnay. Production levels are laughable – with often the lowest yields they’ve ever seen, at a mere 20% of their normal crop – but the quality goes some small way to making up for the loss. The small crop (reduced by the harsh April frost) had a long season to slowly ripen, developing intense levels of concentration, yet – with cooler conditions than 2018, 2019 or 2020 – retaining amazing freshness and acidity. With the wet summer, disease was an issue: Erwan Faiveley described oidium as “exploding” on the Chardonnay (with levels not seen since 2004). Extensive sorting was essential. He also felt it was necessary to fine with bentonite after pressing to ensure the must was clean; similarly at Bouchard, Frédéric Weber didn’t use the very first free-run and inoculated fermentations this year to ensure they ran smoothly. Others, such as Philippe Abadie at Alvina Pernot and Paul Pernot, emphasised how important it was not to over-press. Most wines were chaptalised this year, often just to bring up 0.5%, with the final alcohol levels sitting between 12.5 and 13.5%.  Guillaume Boillot at Henri Boillot – who has produced a stunning range of wines – describes the whites as “salin”, having “belle matière”. Vibrant and pure, these are tightly wound with cool, white-fleshed fruit character, sometimes with tropical richness, often a mineral, saline thread and piercing acidity.  Due to the tiny volumes produced, oak usage varies this year. Boillot used none, but others have slightly more in the blend – feeling it didn’t need the freshness added by components aged in stainless steel. For Jadot, it was the first year that they used exclusively foudres, the larger barrels reducing the flavour impact of oak on the wine. Erwan Faiveley believes that tasting the whites, you can feel “the struggle in them”, that the vines suffered. Tasting through the exceptional Grands Crus he’s produced, however, it’s hard to see this – and perhaps he’s biased by the challenges of working the vines and crafting the wines in 2021. Comparisons are hard for such a unique year, but 2014 and 2017 were common themes, largely due to the high acidity, quality and ageing potential. Philippe Abadie and Alvina Pernot described it as “classic bourguignon”, while Thibault Gagey at Louis Jadot compared the year to 2011 or 2013, although feels the wines are better than those of the latter vintage. Faiveley points to 2007 – a vintage that has never shut down or, for him, disappointed; for Boillot they’re closest to 2016, but more precise. At Bouchard, Weber is so excited by their potential that he plans to keep them in barrel longer – possibly bottling in July 2023. These are really exciting wines – with a vibrancy and energy that is compelling. The cool and mineral classicism here, with great fruit concentration and balance, should age beautifully.

 BURGUNDY 2021: THE RED WINES 
While there is a clear consensus on the 2021 whites, the reds are more varied in the vintage – but much better than we initially thought. The wines have clearly benefited from additional time in barrel, and most addresses have crafted a flight of elegant, pale-coloured and light-bodied Pinot Noirs. Although there are a few, rare examples of dilute or overly lean wines, this is in the main a return to “old school” Burgundy, with wines of perfume rather than power. The volumes are more generous than for the Chardonnay, but still measly, mostly sitting between 30 and 50% of a normal year’s yield. 
Frédéric Weber at Bouchard felt there were two styles of Pinot Noir in 2021: those from plots not damaged by frost, with normal yields but grapes with thin, fragile skins, prone to grey rot. The fruit from frost-hit sites, meanwhile, came with lower yields, thicker skins and less disease – for the latter he preferred to harvest later, with their higher tannin levels.  
Jean-Marie Fourrier noted that the picking date for Pinot Noir was key, worrying that anyone harvesting before the rain on 19th/20th was playing a risky game when it came to phenolic maturity and might have unripe tannins and vegetal notes.  
In general, Florence Heresztyn of Heresztyn-Mazzini felt it was a vintage, like 2012 or 2013, where producers needed to be attentive and precise at every stage – from the vineyard to winery. Sorting was essential and almost every producer chaptalised – largely used to prolong the alcohol fermentation rather than with the sole purpose of increasing the alcohol level. 

 Beyond this, tactics in the winery were varied – with vignerons often taking opposite approaches. Some producers, such as Bouchard, opted for more whole-bunch fermentation. Winemaker Frédéric Weber explained that the stems were so beautiful that he was happy to include 30-50% on average; the potassium also helped reduce the acidity of the wines, giving – he felt – a better expression of the year. 
The opposite was true of many, including Benoît Stehly at Georges Lignier and Hugues Pavelot. At Olivier Bernstein, the team used 30-40%, much less than in a warmer vintage, as they didn’t feel additional freshness was required, nor were the stems sufficiently lignified; similarly Heresztyn-Mazzini used 30-60% rather than 50-100% to avoid any greenness. While Jean-Marie Fourrier de-stems everything, in 2019 and 2020 he added the stems back into ferments for freshness, but didn’t feel it was necessary in 2021. 
When it came to extraction, the approach was similarly broad. Some felt it was a year to be more delicate, others thought it was a year that required more work to extract the colour and tannin that was in the grapes.  
Maxime Cheurlin at Domaine Georges Noëllat used a warmer – and therefore shorter – fermentation (sustaining 33-34˚C, versus 31˚C normally) to build the mid-palate of the wines. Charles van Canneyt had to buy smaller tanks for the miniscule yields, but the tiny tanks therefore fermented more quickly and he was careful to keep maceration short to avoid risking over-extraction. Similarly, Olivier Bernstein was keen to keep the fermentation short, with a five-day cold soak to extract colour and aromatics, then just 13 additional days on skins before the must was pressed – the fermentation finishing off the skins. 
By contrast, Fourrier opted for more extraction to get everything possible from the fruit. Guillaume Boillot echoed this view, with an additional week of skin contact. He used just pumping over rather than punching down to focus on fruit and aromatics rather than tannin; but at Faiveley, Erwan used more punching down than pumping over. 
Some producers highlighted that the grapes had high levels of malic acid (which has been notably low in recent, solar vintages), meaning that malolactic fermentation had a significant impact on the wines. Both Benoît Stehly and Charles van Canneyt noted how they were verging on severe at first, but after malolactic were open and fruity – totally changing in style. On paper, the pH is quite high for some wines (up to 3.7) – yet there is plenty of freshness, the lighter body and lower alcohol (mostly 13-13.5%) perhaps balancing it out.  
For élevage, some winemakers feel the wines need longer or shorter élevage, or different types of oak, with more or less new or different toasting. Nicolas Potel at Domaine and Maison Roche de Bellene feels that the crunchy character of the Pinot Noir will only be enhanced by a longer maturation in barrel (planning for 24 months versus the normal 12). Boillot opted for no new oak (as for his whites), feeling it would mark the fruit too much; while Maxime Cheurlin used less new oak but higher toast levels to add further complexity – and plans to bottle the wines earlier.  For Domaine Joblot, they felt that more new oak helped round out the lighter wines, using 50% new. At Domaine des Lambrays, Jacques Devauges favoured a slow, gentle toast – a "chauffe blonde" that gives the scent of freshly baked bread. Indeed, Devauges feels the wines have been improving significantly in barrel, offering more concentration and aromatics with each month that passes – something that reminds him of the 2010 vintage. 




Frédéric Weber at Bouchard describes 2021 as “charming”, comparing the wines to those of 2017, with good terroir definition and balance at 13-13.5% – more in line with what used to be “normal” for the region.  Thibault Gagey at Jadot pointed to 2004, 2013 or 2017 as possible similar vintages, but finds it hard to compare – it’s old school but approachable. Marion Raphet added 2014 into the mix, and although the wines are incredibly open now, wonders if they might shut down in bottle. For her, however, it is a year where, “On retrouve la typicité” (they rediscovered Burgundy’s typicity). The team at Tortochot pointed to 2011 or 2001, while Erwan Faiveley looked to 2007 and Florence Heresztyn noted the growing season was reminiscent of 2016.  
Maxime Chuerlin looks further back, feeling it has a similar equilibrium, colour and density to the outstanding 1991 vintage – in no doubt that the balance of the wines will allow them to age. While it’s easy to assume that these paler Burgundies might not be the longest-lived, almost every producer anticipates that 2021 will surprise everyone with its ageability – especially for the top wines. 
Almost every single grower we spoke to used a different approach for the 2021 vintage – but almost all have succeeded, producing vibrant, open and pretty Pinot Noir. It is a year in which careful vignerons could craft exceptional wines that were both light-bodied, yet persistent – with a purity and intensity that is surprising, along with captivating aromatics. As Nicole Lamarche said, “You can have both lightness and concentration.” It is, overall, a year that has surpassed expectations – one that was transformed by producers’ dedication, work in the vineyard, and modern technology and know-how in the winery.

Our team spent several weeks exploring the 2023 vintage in Burgundy – visiting, tasting and talking to a range of producers up and down the Côte d’Or. Here, we offer a run-down of the year by producer, from north to south, reporting on how each fared and our pick of their range this year

Unlike many wine-lovers, I came across Occidental before Kistler. I worked for a company that imported some of its early vintages – and they were like nothing I’d ever tasted. These translucent Pinot Noirs glimmered, but their pastel-pale shade was nothing but a nudge and wink at the Burgundies that inspired them. Aromatics leapt from the glass – floral and febrile, but it was the vivid, intense, crystalline purity of the palate that I found so beguiling. Seeing where these wines are made – on the brink of the Pacific, where ocean breezes lash at the vines, and thick fog grasps the dramatic, undulating landscape – only made them all the more enchanting. Even today, 18 years after Steve Kistler first put down vines here, the region is sparsely planted – with Occidental one of a handful of pioneers of the outer reaches of the Sonoma Coast. The area was long deemed too cold to ripen fruit, with dairy the main industry – and fields of grazing cattle and sheep are still interspersed with plots of vines. Occidental’s vineyards – now 85 acres in total – now neighbour those of Platt, Littorai and Joseph Phelps’s Quarter Moon site, sitting at 500 feet above sea level – a modest altitude when you consider some of Napa’s mountain districts have parcels above 2,000 feet. But it’s their proximity to the ocean (which is just five miles away) that makes the climate here so cool – and damp. Leaf-pulling and spraying are key to managing disease pressure – unfortunately making organic farming almost impossible. “We want the purity of fruit to shine,” Catherine (Cate) Kistler says. She joined her father, Steve, six years ago, working as his Assistant Winemaker – just one element that makes the venture a true family business. Not in the way that Walmart or Ford are a family business, but in the hand-to-mouth, everyone-mucks-in, this-is-both-their-livelihood-and-legacy kind of way. It’s a “tight little universe” where they work, live and farm, Cate explains. This is one reason that Steve stepped away from the iconic winery that he’d created in 1978 – Kistler had shifted and grown, becoming something larger than he’d ever anticipated, or necessarily wanted.  Kistler had humble beginnings – with Steve making the wines in what was essentially a wooden shack, and living upstairs. That building – up in the Mayacamas – was consumed by the fires in 2020, and today Kistler works with around 300 acres (including their own vines and those farmed by growers for them). The investment of Bill Price (a man whose first major move in the wine industry was buying, and later selling, Beringer) has added further gloss to a winery that has become one of California’s cult names. If that makes it sound like there’s been wholesale change, that’s far from the truth – a clear succession plan has ensured only the gentlest of evolutions at Kistler, and ensured the producer maintains its position at the top. Jason Kesner – who describes himself as a “vine and yeast shepherd” – is the man at the helm today. He joined the team in 2008 (aged 40), working alongside Steve for close to a decade before taking the reins.  Although born on the East Coast, Kesner grew up around wine. He moved out to California aged eight, where his mother had taken a job as Head Microbiologist at Robert Mondavi, and his soon-to-be stepfather worked as VP of Vineyard Operations – the smells and sounds of a working winery firmly familiar. Despite his early initiation to the industry, he studied cultural anthropology and left both the area and industry. He was eventually lured back, working first for Francis Ford Coppola (the man behind Inglenook’s revival), but in a non-wine role – managing his special projects. Via Coppola’s poker games, Kesner connected with Pat Kuleto and ended up planting vineyards for him, before finding himself at Hudson (his “graduate school for Chardonnay production”). This prestigious name features on bottles from the likes of Aubert, Kongsgaard, Cakebread, Failla and Ramey – and Kesner got to work with all of them, growing top-tier fruit for 34 clients, including Steve Kistler. And Steve was different. He was, Kesner says, “very, very focused”, “hyper-intelligent, borderline genius” and – along with his business partner, the late Mark Bixler – thought about things on a different level. When the duo started Kistler in the 1970s, working with a single clone and single sites, no one else was doing it – with his unparalleled energy and intent, Steve created something profound. Although Kesner had already worked closely with Steve at Hudson, it was only when he arrived at Kistler in 2008 that he realised how differently Steve operated. “I had jumped into a different timeline and a different pace,” Kesner tells me. “Steve and I had conversations that, quite literally, spanned years.” These conversations would be picked up each vintage, just a handful of sentences on a topic expressed until the next season. For Kesner, this long-term vision was what set Kistler apart: “It’s not about the people who are doing it at the moment. It’s about everything that’s come before and it’s about everything that will come after.” The Kistler evolution has been slow, but it has happened – past their phase of “embracing the cocaine ’90s” (“If you weren’t, you weren’t paying attention,” Kesner says), with a shift toward earlier picking, native ferments and reduction in new oak (from 50% down to around 38% across the range today) – but without sacrificing the seductive, silken style that defines their Chardonnay. “Our job is to polish the jewel,” Kesner says. “The diamond doesn’t need to be re-cut.” The vines are also gradually gaining in age (currently averaging a spritely 35 years), which is only improving the wines further. Kesner is continuing Steve’s work and the philosophy remains true to the original concept. “The best and highest use of a given site is when you're guiding it, not driving it,” he says, pointing to Mother Nature (rather than Bill Price) as the ultimate boss. He loathes the title “winemaker” – fully aware that it’s an entire team behind Kistler. “There are 56 people who are dedicated to the production of these wines. They’re out there pruning in January and then they’re going to be out there picking for this year in October. And it’s because of that really powerful group of people that we’re able to do what we do.” Meanwhile, out on the coast, Steve is continuing his own quest for terroir. Occidental, Cate tells me, is all about exploring “what this ridge means”. The yields at Occidental, overlooking the Pacific, are tiny, maxing out at around two tons/acre. The work is painstaking, with careful canopy management and spraying to avoid mildews, and steep slopes that need to be hand-hoed to manage the weeds. And, as at Kistler, the Pinot Noirs here are all made identically – so it is the site, rather than hand of the maker, that shines through. Be that though it may, it takes exceptional talent to make wines like this. “[Steve] is yet again 30 years ahead of everybody in California,” Kesner says. “It might take the American palate a while to catch up with them, but I firmly believe those will be recognised as some of the best Pinot Noirs in the world. Hands down.” Steve’s an elusive character – and seems happiest tucked away in his remote corner of the Sonoma Coast, away from the limelight. “He’s not a man of many words,” Kesner says, although suggests that working with Cate has drawn him out of his shell a little. Cate talks about him unsurprisingly lovingly, but doesn’t shy away from admitting there are challenges to the “weird and wonderful world” of family business. Harvard-educated, she’s quick-witted and sharp, and has clearly inherited her father’s passion for wine. Not only is he clearly deeply embedded in everything Occidental, but his interest goes beyond vine-growing, with what I suspect is an enviable collection of his own, from the alluring line-ups of Grand Cru Burgundy that I’ve glimpsed on Cate’s Instagram. It takes something rather extraordinary to be willing to give up your name, to start from scratch, all over again, with a new winery and new vineyards. But there’s a reason that his longtime vineyard manager (Ruben Molinar) and cellar master (Raymundo Abarca) left Kistler with Steve in 2017; and it’s a tribute to the man. Now Molinar and Abarca’s children are working alongside Steve’s – and the family is growing. But Cate and Steve don’t want to create Kistler 2.0. They’re developing another ranch, but they don’t want the project to become so big that they’re no longer doing most of the work themselves (“We’ve seen that movie,” Cate jests). The first vintage of Occidental was only 2011, but the wines are already making their mark. Steve’s legacy at Kistler lives on, safely being shepherded by Kesner and his team, but it’s also being re-born at Occidental, and set to be carried forward by Cate. “Wine is my dad’s world,” Cate tells me. For a long time, Tuscany was known merely for its squat jugs of rustic Chianti, almost inevitably in quaint straw baskets; thin, insipid wines that are a shadow of what the region has proven it can produce today.  While Chianti had once been known for making fine wine – having been the first region to have geographical limits defined for wine production back in the 18th century – its reputation had, by the mid-1900s, been ruined. The area for production had been expanded in the 1930s, far beyond the historic heart of the region, encompassing lesser vineyards. The appellation rules encouraged producers to favour quantity over quality, with yields as high as 85hl/ha allowed, and specifying that red blends had to include a minimum 10% (and up to 30%) white grapes, with as little as 50% Sangiovese. Winemakers took advantage of high-yielding Trebbiano to bulk out the once-famous wines.  But one man changed all that. Enter Mario Incisa della Rochetta, a man who had been brought up tasting Claret with his grandfather. In 1944 – missing the taste of Bordeaux and inspired by the good wines his friend Duke Francesco Salviati was making near Pisa – he decided to plant a vineyard on his wife’s Tenuta San Guido estate in Bolgheri, on Tuscany’s coast, two hours west of Siena.   Identifying a stony site that sat at over 1,000 feet above sea-level, he took Cabernet cuttings from Salviati, and planted his first vines. The resulting wine was consumed only by family and friends, seen as overly green by the locals. But Incisa della Rochetta was encouraged by the results, and decided to plant more vines lower down the slope, and closer to the sea, in 1965.  His nephew Piero Antinori – who had recently taken over the family business – realised the potential of the wine, and the Antinori winemaker Giacomo Tachis started making the wine. Influenced by time in Bordeaux, Giacomo filled the cellar with new French barriques – small barrels that were a radical move away from Italy’s traditional large, old casks made with Slavonian oak. In 1971, Piero convinced Mario to release the 1968 vintage commercially and a star was born: Sassicaia.  Being 100% Cabernet Sauvignon, aged in new French oak and from Bolgheri – a region that at the time didn’t have a DOC – Sassicaia was labelled with the lowest official classification for Italian wine, “vino da tavola” or table wine. It rapidly won praise from critics and consumers, commanding a serious price that was at odds with its lowly classification. Where Sassicaia led, others followed. In 1978 Piero Antinori released the first vintage (1971) of Tigananello – a blend of Sangiovese and Cabernet grown in the heart of Chianti Classico. Bordeaux authority Emile Peynaud advised on the project, suggesting that the appellation’s stipulated white grapes were abandoned and that it be aged in new French oak. Falling outside Chianti’s rules, it too was sold as a vino da tavola.  Piermario Meletti Cavallari founded Grattamacco in 1977, and was the first to feature Bolgheri on the label, featuring this then little-known region in larger font than even the wine’s name itself. Piero Antinori’s brother Lodovico established Tenuta dell’ Ornellaia in 1981, planting Cabernet and Merlot. A flight of Chianti producers followed suit – ripping up the appellation’s rulebook to make cuvées with international grapes like Cabernet, using 100% Sangiovese, and/or French oak: Le Pergole Torte, Flaccianello, Cepparello, Percarlo, Fontalloro and more all pushed the boundaries of what was possible in Tuscany – but didn’t (and couldn’t) bear the region’s name on their labels. These wines – the “Super Tuscans”, as they became known – were soon being recognised the world over. In 1978 Hugh Johnson organised a blind tasting of the world’s best Cabernets for Decanter. Pitted alongside the First Growths, it was Sassicaia that came out on top. The 1985 vintage of Sassicaia became legendary when Robert Parker – who had just risen to fame – gave it 100 points. In 2001, 1998 Ornellaia was named Wine Spectator’s Wine of the Year. These wines were putting two fingers up to Italy’s appellation system as they sold for the same price as Grands Crus Classés, despite their vino da tavola status.  In a bid to stem the tide of these ultra-premium table wines, the Italian authorities started to make changes. In the late 1990s and early 2000s, Chianti amended its appellation rules to try and reclaim the wines, allowing more variation in the winemaking, with no white grapes required and allowing 100% Sangiovese wines. But the damage was done, with the Super Tuscans already established as their own brand. Few returned to the fold to use the Chianti name on their label – a region that producers felt didn’t, then or now, have a reputation that aligned with the quality of these world-class wines.   The likes of Sassicaia, Tignanello and Ornellaia drew the international wine market’s eye to Italy. Bold, big, rich wines that won critics points, the Super Tuscans arguably turned the tide for the nation, garnering praise – and proving that Italy’s wines could compete on the world stage. Today, critics and consumers are looking beyond these iconic names to explore Italy’s extraordinary viticultural heritage, with the terroir-driven styles of Barolo, Barbaresco, Montalcino, Etna and more starting to find the spotlight. But Tuscany’s rebellious streak continues, with a new wave of producers – such as Bibi Graetz – producing wines that are bottled defiantly as IGT Toscana. While there’s plenty more competition, the Super Tuscans remain some of the country’s finest and most collectable wines. The Super Tuscans you need to know While there’s no set definition for a Super Tuscan, and there are many that could take the title, here’s our pick of the most famous wines. Sassicaia: The first Super Tuscan, made by Tenuta San Guido, in Bolgheri; it’s a blend of Cabernet Sauvignon (85%) and Cabernet Franc (15%), and is the only single estate in the whole of Italy to have its own DOC, Bolgheri-Sassicaia. Tignanello: A rival to Sassicaia in terms of fame, and also put under the sporlight by Piero Antinori, Tignanello comes from Chianti. It was the first to blend Sangiovese with Cabernet. Solaia: Tignanello’s sibling, Solaia is the reverse in blend – with Cabernet taking the lead, complemented by a smaller proportion of Sangiovese. Ornellaia: Created by Piero Antinori’s brother Lodovico, with advice from André Tchelistcheff, it’s a Cabernet-led Bordeaux blend. The property has changed hands over the years and is now owned by the Frescobaldi family. Masseto: The other wine created by Lodovico Antinori: although planning originally to work just with Cabernet, Tchelistcheff identified the hill of Masseto as ideal for Merlot. The fruit from this site was bottled separately as a pure Merlot for the first time in 1986 (although the 1987 was the first vintage released), and today Masseto operates separately from the Ornellaia estate, having its own winery and identity. Grattamacco: Another of the earliest Super Tuscans, this is Cabernet blended with Sangiovese. Piermario Meletti Cavallari purchased an abandoned vineyard in 1977 which was all Sangiovese, but he later grafted over with Cabernet. He was one of the first producers to feature Bolgheri on the label of his wine. Montevertine Le Pergole Torte: This was one of the earliest expressions of pure Sangiovese from Chianti, aged in French and Slavonian oak. The first vintage of this was 1977, a blend of fruit from the estate’s best vineyards. Fontodi Flaccianello della Pieve: The first vintage of Flaccianello was 1981. Originally a single-vineyard expression, since 2001 it’s been a blend of the best grapes from the estate, but remains 100% Sangiovese, classified as Colli Toscana Centrale. The proportion of new oak has been toned down, and a portion of the wine goes into amphora. Isole e Olena Cepparello: This pure Sangiovese was first made in 1980, and today only sees around a third new oak, with a small proportion of American oak. It’s notable that it is bottled both under screwcap and cork, with Paolo di Marchi a strong believer in the benefits of screwcap. San Giusto a Rentennano Percarlo: First made in 1983, this 100% Sangiovese comes from the estate’s best vineyards. Fèlsina Fontalloro: Made with vines falling in Chianti Classico and Chianti Colli Senesi, this pure Sangiovese was first made in 1983. Castello di Ama L’Apparita: Narrowly beating Masseto to be the first 100% Merlot made in Tuscany (with the first vintage 1985), the 1987 vintage of L’Apparita famously beat Pétrus, Le Pin and several other Merlots in a blind tasting which was judged by a panel including Michel Rolland in 1992. Querciabella Camartina: First made in 1981, this was originally a blend of mainly Sangiovese with Cabernet in support, but the blend has reversed over time. Bibi Graetz Testamatta & Colore: Bibi’s top wines are elegant expressions of Tuscany’s indigenous grapes, sourced from old vines at high altitudes.
