What is Port? Port is a fortified wine made in the Douro Valley in Portugal. Traditionally the wines were shipped along the river to Oporto (also known as Porto), from which the wine takes its name. A huge number of grapes are permitted for Port production, however, there are five main varieties used: Touriga Nacional (widely thought to be the best grape for Port, giving its name to Quinta do Noval’s top wine, Nacional), Tinta Barroca, Touriga Franca (or Touriga Francesa), Tinta Roriz (aka Tempranillo) and Tinto Cão. The vineyards sit on steep, terraced slopes alongside the Douro river. Thanks to these vertiginous slopes, much of the vineyard work has to be done by hand, with little mechanization possible. The further inland you go – moving east from Oporto – the hotter and drier the climate becomes. The vineyard area is divided into three key regions: Baixo Corgo: The coolest and wettest region which produces the lightest wines. Cima Corgo: With lower rainfall and higher temperatures, this is the traditional area for the best Port wines. Douro Superior: Particularly dry and hot, this lesser-planted region nevertheless can produce very high-quality wines. For red wines, the grapes are trodden – traditionally by foot, but also now by machine – and fermentation is cut short by the addition of neutral alcohol (called aguardente), thereby leaving residual sugar in the wine. Styles of Port 
There are two main types of Port – those aged in bottle and those aged in cask. Those
aged in cask are designed to be consumed upon release, while those aged in bottle need time to mature.  Ruby: The most basic, entry-level Port is Ruby. The wine tends to be aged in cask or tank for two to three years. Bottled while youthful, it’s bold and full of primary fruit, with a fiery kick from the spirit. No need to decant. Reserve: A step up from ruby, this wine is normally aged a little longer (again in bulk rather than bottle), perhaps being made with higher-quality fruit, so that it has more complexity than a ruby Port. No decanting necessary. LBV: Late Bottled Vintage Port comes from a single year, but spends more time maturing in cask (rather than bottle). Bottled between four and six years after its harvest, the wines are designed to be consumed long before vintage Port, but offer some of the complexity of the
style. Some wines are filtered and others aren’t, so it may or may not need decanting. Crusted: This style takes its name from the crust, or sediment, it throws while in bottle. A blend of several years, the wine is – like LBVs – aged a little longer in cask before bottling,
and likewise is designed to offer some of the complexity of vintage Port. Decanting is essential Vintage: The finest Ports come from a single vintage. This style accounts for a mere 1% of production, with the wines only made in certain years from the very best fruit. Traditionally vintages are either “declared” by producers (and therefore it is a year where they make a vintage Port) or not (with the official declaration classically announced on St George’s Day, a year and a half or so after the harvest). There are, however, a few years with “split declarations” where some producers chose one year, and others chose another for their vintage wines. While once there were only three or so declarations each decade, climate change has seen an increasing number of years producing fruit worthy of vintage wines, and therefore an increasing number of declarations. The wines tend to spend two or three years in wood, but are aged mostly in bottle. These
wines are built to last – having lots of tannin, flavour and alcohol. Spending decades in bottle, they develop extraordinary complexity. Because of the high tannin level, these wines throw a lot of sediment and it is essential to decant them. Single Quinta: These are vintage wines from single “quinta” or estate (while Vintage Ports are often a blend of estates), often produced in years that are not officially declared.  Tawny: Tawny Ports are aged oxidatively in cask, and thereby gradually losing colour to develop a “tawny” colour, while also developing nutty, dried fruit and caramel aromas. The longer it is aged, the more complexity it has. (The most basic examples are a blend of ruby and white Port to create the appearance of a Tawny, but none of the same flavour complexity.) Tawny Reserves have seen minimum seven years in cask, while many come with an age statement – 10, 20, 30 or Over 40 years old – indicating the average age of the blend.  Colheita is a Tawny from a single vintage, spending minimum seven years in cask prior to release (although it is often longer). They are designed to be consumed soon after bottling (a long time in bottle can in fact negatively impact the wine’s quality) and no decanting is
necessary, although you may want to chill the wine lightly. Given their oxidative nature, Tawnies can often last longer once open than their red counterparts.  White: White Port is mainly made with the Gouveio, Malvasia Fina and Viosinho grapes. Youthful examples can make for an excellent aperitif, sometimes served with tonic and lemon as a cocktail, but you can also find rare aged white Ports, carrying an age statement that – as with Tawny Port – is the average age of the blend. Walking into the cooperage at Ch. Smith Haut Lafitte is like stepping back in time, filled with the smell of seasoned wood, an open fire and the same tools that barrel-makers have used for centuries. Few estates have the luxury of an in-house cooper. While producers inevitably work closely with the tonnelleries (barrel-making firms, such as François Frères, Stockinger and more), having an artisan on-site, working alongside the winemaking team to craft casks exclusively for your specific terroir is different. “It’s very important for the precision of the wine,” explains Cellar Master Yann Laudeho.  Florence and Daniel Cathiard, owners of the Pessac-Léognan estate, built a cooperage on-site almost 30 years ago, in 1995, and their current cooper, Yann Dez, has been working here since 2021. The Bordeaux native’s father was a metal worker, and Dez fell into the world of barrel-making entirely by accident – having a friend who was a tonnelier, and a job opening at an opportune moment. Before he knew it, Dez had learnt the trade from some of the best coopers in the country (including one who now makes the barrels at Ch. Margaux), and spending 15 years working under Didier Fesil. Fesil was the Cathiard family’s first cooper back in 1995, who went on to create his own small tonnellerie (Tonnellerie Bordelaise), and has been named the nation’s best “Master Cooper” – twice. Indeed, Fesil is still very involved with the estate, helping choose the wood for barrels and advising on all things oak; and it was Fesil who put Dez forward for the role at Smith Haut Lafitte.  “There are no books,” Dez says, when I ask about the art of barrel-making. “It’s passed on from tonnelier to tonnelier." The first evidence of coopering as a trade dates back to 900BC – with the craft passed down the generations ever since. “I continue the tradition,” Dez says, clearly with a sense of pride in this ancient, artisanal skill. But with the dust, noise and physical labour involved, tonnellerie schools, Dez tells me, are struggling to recruit young people. It’s common for coopers to have issues with their shoulders and ears (from the non-stop hammering) – and Dez himself has broken an elbow.  In theory, the process can be mechanised – but Dez is clear on how important it is to work by hand, and not just to preserve this ancient art. “I hear the nose, I feel the resistance,” he says. Each barrel, he explains, is different – with a slightly different number of staves and slightly different shape, all adapted according to the wood he’s working with. Selecting the right wood is key – “reading” it, he explains, looking at the grain to see where potential weaknesses are, understanding where will take the most pressure and placing each stave accordingly, ensuring not a drop can seep from the finished barrel. “It’s a job that is both physical, and at the same time requires thinking,” says Dez – and this combination is much of its allure for him.  Hearing the way Dez talks about barrels is fascinating; for him, they each have a unique personality. When I ask Dez how he knows he’s made a really good barrel, he shrugs: “On le sent.” (“You feel it.”) As you toast a barrel, he tells me, the scent of the smoke changes, releasing different aromas – something I smell as he works in front of me. Knowing when it’s spent the perfect amount of time over the fire is the secret – and it’s about more than just the smell, it’s a gut instinct that he can’t quite explain.  Smith Haut Lafitte sources oak from a range of forests, and are always trialling wood from different forests, toasts and doing blind tastings, although – after over 25 years – they know what works for their wine, and terroir. Cellar Master Laudeho explains that, for him, Tronçais and Jupilles are the best – “diamonds” that flawlessly complement their site. And that balance is key; the wood works for the wine, not the other way around.  It seems like a lonely job, I comment, hammering away in his tower – but it’s not something that bothers him. “I’m a bit of a perfectionist,” he tells me. Having only himself to depend on, and knowing that he can ensure each barrel meets his exacting standards, suits him. Indeed, he doesn’t even settle for standard tools – making most himself, custom-designed to suit the way he works. He talks me through a specific hammer that he made, and how it allows him to work better and more precisely, the wooden handle almost silken from the hours of use, shaped to his hand.   The lone electronic technology to have earned a place here are noise-cancelling headphones and a Marshall speaker. He’s a musician in his spare time, and an additional perk of working alone is that he gets to spend all day listening to music. “All the barrels I’ve made,” he says, “are made with music.” He avoids anything too modern or electronic, favouring old jazz, with some reggae, ska jazz and funk in the mix, depending on the day. While he doesn’t feel the music he listens to influences his coopering, he suspects his mood does – and music is a big part of that.  Woodwork is much more than a job for Dez. I spy a beautiful chest alongside his speaker, and it’s one that he made. He has a workshop at home too, spending his free time making everything from guitar stands and toys to chandeliers – anything, he says, that isn’t straight, and therefore can’t really be done by a machine.  It’s amazing watching him work – in the same way as coopers have for centuries – with a natural intuition, ease and precision. There’s definitely something musical to it, a craft that has its own rhythm. He makes around 300 barrels a year, and they may not be soloists – but each one contributes their own note to that year’s symphony.  Explore all current listings of Ch. “Meet my girlfriends,” calls Telmo Rodríguez down the phone, laughing as he flips his camera to show two enormous shaggy-haired mutts. The skies are crisp and blue on the other side of the screen, the sun beating down on Remelluri, his family estate in Rioja Alavesa. The camera swings across the horizon as he introduces me to one of his team before rushing indoors to sit down for our call. There’s an almost frenetic energy to Rodríguez – and that energy is what in many ways defines the maverick winemaker, who has been one of the transformational forces in Spanish wine.  His parents purchased La Granja Nuestra Señora de Remelluri – a farm that has been home to vines since at least the 14th century – in 1967. Growing up on this special property, young Rodríguez went off to study winemaking in Bordeaux, then trained at properties including Cos d’Estournel, Domaine de Trévallon, Chave and more. He returned home inspired and excited to use his new-found knowledge on the family property in the early 1990s. But his father didn’t welcome Telmo’s ambition: the market didn’t want great or even good Rioja, he told his son – the market wanted cheap Rioja. Although he wasn’t allowed to make changes to the red, Rodríguez was given free rein to create the property’s first white wine. And that wine rocketed him to fame. White Rioja has always been niche (today just 9% of the vineyard area is planted to white grapes), but in the 1990s its future was looking uncertain – with the traditional, oxidised style of wines such as López de Heredia’s Tondonia Blanco fallen from grace, and many producers had given up on making these wines (as with CVNE’s Monopole Clásico, which has since been revived). Rodríguez wanted to create a wine of place, rather than a wine of style, and used complex field blends planted at higher altitudes to do so. Fermented and aged in a combination of tank and oak, Remelluri Blanco was unlike any other wine in the region. Robert Parker wrote of the 1996 vintage that it was “the finest white wine [he had] ever tasted from Spain”. The multi-variety blend doesn’t include the region’s trademark white, Viura, and is technically illegal – a fact that perhaps has only increased its appeal.  But Rodríguez was frustrated by his father, by the limitations put on him and his wines. Restless and with a rift in the family forming, he flew the coop to focus on his own project. In Bordeaux he had become friends with a fellow Spaniard, Pablo Eguzkiza, who had been working at Pétrus, and together they had already started making wine – beginning with an old-vine Garnacha from Navarra in 1994. With that wine, Compañía de Vinos Telmo Rodríguez was born.  Their vision was to make real Spanish wine – the wines that had been made before, as they saw it, France started to sway the industry. When the deadly louse phylloxera had swept through France in the late 19th century, killing its vineyards, the nation looked south, across the Pyrenees to Spain. Producers travelled there to make wine and feed demand, and Rioja in particular saw an influx of business and money – but this uplift also came with French influence. In Rodríguez’s view, this was the ruining of the trade – Rioja, which had once been a wine of site, became a wine of oak. And soon, across Spain, the variety that once defined its many regions was being over-written with international varieties. Spain became known for cheap wine – and producers were racing to the bottom.  “The worst are the British,” says Rodríguez. “They say they know Rioja and they know Sherry, but, in a certain way, the British market killed Sherry and killed Rioja because they are very happy to have a cheap Reserva for a few pounds.” The dominance of what he describes as “industrial brands”, the larger houses that buy in fruit from across the region, aged in American oak for “traditional” styles, and French for “modern”, is abhorrent to him.  “I’m sorry, you don’t know anything about Rioja. Tell me one village. Tell me one taste. Tell me one landscape. Tell me one mountain. Nobody knew anything,” he says. He explains how Labastida – a village neighbouring Remelluri – was once the Vosne-Romanée of Rioja, home to 330 different wine producers in 1680. But over the years, that history has been blended away.  Together, Rodríguez and Eguzkiza set out to uncover and reveal the Spain of yesteryear, working with old vines, native varieties and traditional methods to champion what they saw as the true Spanish wines. From their beginnings in Navarra, they looked to Arribes del Duero, to Rueda, to Málaga, to Aragon and back to Rioja, then Ribera, Toro and Sierra de Gredos.   “Now we are showing what is real,” Rodríguez tells me, with a sense of satisfaction. In Rioja, for example, they created Bodegas Lanzaga in 1998, looking to focus on the terroir around the town of Lanziego. The Consejo (regulatory body), however, didn’t allow them to use the name of a village on the label until 2017. For almost two decades they protested this rule, featuring the name on the label, but redacted (inspired in part by the art of Jenny Holzer). Today, there is a clear, and growing, movement of producers looking to focus on single-site expressions of Rioja’s best vineyards, shifting away from cross-regional blends and the dominance of oak. This echoes what is happening elsewhere in Spain, as producers focus on indigenous grapes and identifying what makes each of its varied regions unique. It’s a revolution – one that Rodríguez has been at the forefront of. It's easy to think of this rockstar duo as flying winemakers – having so many projects scattered around the country, only touching down briefly to sign off on blends before they’re off to their next event. While inevitably their schedule is intense, their focus is firmly in the vineyard and on reflecting each individual place and site – rather than crafting a range that speaks of their influence. “It’s a very honest approach to a place,” Rodríguez says. The references throughout our conversation only emphasise this: Burgundy, the ultimate “terroir” wine, is where he finds his inspiration; while the Super Tuscans are repeatedly scorned for their internationality.  Matallana is quite possibly Telmo Rodríguez’s most ambitious project to date. He and Eguzkiza first made wine in Ribera del Duero in 1998, and have slowly built up 21.5 hectares of vines around the region.  “My dream was to do a very good Vega Sicilia. I wanted to do the Vega Sicilia that I used to drink in the past,” explains Rodríguez, talking about bottles from the 1940s, ’50s or ’60s. Back then, he says, it wasn’t an estate wine but fruit was sourced from around the region. For him, Vega Sicilia is now too “Bordeaux-style”. He argues that while in Rioja the soils are quite consistent, Ribera del Duero is incredibly varied. They have chosen to work with a range of vineyards across five villages – Sotillo de la Ribera, Roa, Fuentecén, Fuentemolinos and Pardilla – ranging from quartz-rich or pebbly soils reminiscent of Châteauneuf-du-Pape to chalky albariza and clay-heavy sites. This diversity is what helps bring complexity to the wine, with each one producing a different expression of Tinto Fino.   The work involved in each of the Compañía de Vinos Telmo Rodríguez projects is painstaking, tracking down special parcels, reviving soils and replanting or grafting where necessary, working organically and biodynamically, to achieve the quality they’re looking for. For Bodegas Lanzaga, for example, it was over a decade before they produced the first vintage of their top wine, Las Beatas, from a 1.9-hectare plot of the same name (first made in 2011).  For Matallana, they wanted to track down the region’s very best, historic vineyards in each of the five villages. But it’s not been easy. All too often they’d been abandoned, some needed re-planting entirely, or otherwise re-grafting with massal selections, and serious work to bring the soils back to life. They wanted to work with unirrigated bush-vines and field blends – vineyards farmed as they might have been in the 19th century. And then there’s the complex ownership: to buy just six of their 21.5 hectares took seven years, purchasing tiny plots from 40 different families.  Although they’ve been making wine here since the 1999 vintage, it wasn’t ready until relatively recently – and Rodríguez considers the 2014 the first “real” vintage of the project. Before that point they had made three wines, a selection of fruit from the oldest vines that went into the “Grand Vin” Matallana, a second wine M2 and the unoaked Gazur from younger plots. “They were prototypes, we were learning,” explains Rodríguez. From 2014, there is only one wine, with a change in the label to reflect the shift.  As with the older vintages from Bodegas Lanzaga, the label shows a list of redacted vineyard names – which are still not permitted to feature on the labels in Ribera del Duero. “All those vineyards are the guarantee of the purity of our wines,” says Rodríguez. In fact, the label is embossed, so beneath the censored text, you can feel the names of these terroirs. He’s moved to reduce the oak, using some foudres and tinajas (amphorae), while also acknowledging that the wine needs movement and oxygen to polymerise the tannins. The result, however, is a more delicate wine. At the end of the day, he says, “We don’t care about the winery… our wine is the landscape, is the soils.” The difference between the “new” and “old” Matallana is striking. The 2020 is pure, vibrant – a mineral wine with crystalline fruit that speaks of place.  “I don’t want to be pretentious, but we want to create another iconic wine from Ribera del Duero,” says Rodríguez. There’s no shortage of ambition here – and they’re looking to increase production to around 40,000 bottles a year (up from around 25,000 currently). “It took us 25 years… but we knew we were doing something rare, different.” The latest move has been to partner with Jean-Guillaume Prats (currently of Ch. Léoville Las Cases, previously of Ch. Lafite Rothschild and Cos d’Estournel), and start distributing the wine via La Place de Bordeaux, to bring the wine to an even bigger audience.  Rodríguez is now 61 – but there’s no sign of him slowing down. “People say that I’m too old to plant vineyards,” he says, clearly finding such a thought absurd. He’s just planting three hectares he tells me – vineyards that will be amazing, he feels, maybe in 15 years’ time. On the day we talk, he had five local youths coming to meet his team, the children of local viticulturalists in Labastida; they’d be making wines together with the best 2,000 kilos from each of their family’s plots – a project that has been going four years. The 2022 Bordeaux vintage may only just have made it into the winery, but it’s already one for the record books. “Unique”, “historic”, “completely new”, “extreme” – the growing season brought never-before-seen conditions to Bordeaux. And producers are clearly excited about the potential of the year.  While 2021 saw a cool, wet year with chaptalisation widespread, 2022 was hot and dry. From February onwards, temperatures were consistently above the 30-year average (by 1-3˚C), while rainfall was consistently lower than the 30-year average. Indeed, Météo France (France’s national weather service) reported that July was the driest since 1959. The weather was so dry that certain appellations were even permitted to irrigate – Pessac-Léognan on the Left Bank, and both Pomerol and Saint-Emilion on the Right.  Pierre-Olivier Clouet (Technical Director at Ch. Cheval Blanc) explained how the region had experienced dry periods before – pointing to 1976 as an example –but never before had they seen practically no rain from budbreak to harvest. This drought, combined with the heat (with four heatwaves bringing temperatures of up to 40˚C), was remarkable and made for unprecedented circumstances. He believes that the consistent dryness was key, with the vines having to self-ration from the start of the season to survive. Indeed, the winter was relatively dry, with 200 rather than the normal 400mm. Echoing Clouet’s opinion, Ch. Margaux CEO Philippe Bascaules believes that the dry April and May forced the vines to drive their roots deeper.  Budbreak was early, and – as is now almost the norm – frost struck the region at the start of April, with the mercury on 3rd and 4th April registering as low as -7 or -9˚C in some places. Noëmie Durantou Reilhac of Ch. l’Eglise-Clinet noted that they only had to use “bougies” (smudge pots) to protect the vines over two weekends, however because the cold weather fell on weekends some people struggled to get workers out into the vines. With their small holdings, the Durantou family could manage it themselves. She also noted that it was a particularly unusual and severe black frost, with tunnels of colder air that caused damage and weakened some vines. Despite this, the Durantou vines escaped unscathed. With investments made and experience gained in recent years, few saw any significant impact – there was a little at Quinault l’Enclos, but none at Cheval Blanc, and the damage at Ch. Margaux wasn’t even worthy of calculating – perhaps 5% on five blocks.   Flowering was even and as was véraison, however Durantou Reilhac reported that the grapes then took a long time to all change colour. The leaves started drooping, showing the signs of heat stress towards the end of July. She reacted by doing an early green harvest, so that the vines could focus their energies on a smaller crop – but highlighted it was important this was done early.  At Ch. Margaux, Bascaules noted that younger vines (those under 10 or 15 years old) suffered most – not having the deep roots of more mature plantings. At Cheval Blanc, they noted that it was especially those younger vines on less water-retentive gravel and sandy soils that struggled. With the high temperatures, some producers reported vines shutting down, while others said it wasn’t an issue.   Guillaume Pouthier at Ch. les Carmes Haut-Brion emphasised how the night temperatures were what really set the hot summer apart from a year like 2003. While there were a similar number of days over 35˚C, in 2003 there were eight or nine nights with temperatures above 25˚C; in 2022, it reached a maximum 20˚C in Pessac-Léognan overnight. This significant diurnal shift helped preserve aromatic finesse.  At Carmes, they worked the soil in the evenings to help retain water. To shield the grapes from the sun, they also kept a full canopy, not de-leafing at all, and used a mixture of white clay and talc to protect the grapes, which kept the internal berry temperature as much as five to 10˚C lower.  Unsurprisingly given the conditions, harvest was early. Noëmie Durantou Reilhac returned from holiday on 16th August and was almost tempted to pick then. Their team ended up holding off until 31st, while Cheval Blanc started on 29th August, finishing on 20th September. At Carmes, they picked from 5th September to 9th October, while Ch. Margaux picked from September 8th, deciding to do two passes through every block to sort out any shrivelled or sunburnt fruit.  There are two important elements to acknowledge: hail and fire. On June 20th and 21st, there were extraordinary hailstorms – with hailstones the size of golf balls. These were, however, extremely localised and struck mainly lesser vineyards in the Haut-Médoc and Médoc. Next were wildfires that raged through the region in July and August. While the fires didn’t come close enough to cause any damage to vineyards, there were fears over possible smoke taint at certain addresses. So far, however, none has been reported, with the belief that the grapes were early enough in the cycle and still had sufficiently thick skins so as not to be impacted.  In these unique conditions, the New World was a helpful reference point. Philippe Bascaules noted how more and more Bordeaux has to ask the same questions as California does, while Pierre-Olivier Clouet felt that his experience of Malbec in Mendoza was particularly useful. “We were ready to fight with this kind of vintage,” he explained.   “I think it’s going to be a big year for Merlot,” Durantou Reilhac said. “I’ve never tasted Merlot grapes with such power and amazing aromatics.” Almost in spite of the conditions, there’s perfect balance – the hitch, unfortunately, is that there simply wasn’t much of it. With the hot, dry conditions the crop was small – with tiny, thick-skinned berries. Pouthier at Carmes highlighted just how small they were – with Merlot around 1g versus 1.3-1.4 normally, while Cabernet came in at 0.-0.9g versus the normal 1.2. Carmes’s yields were down about 20%, at around 35hl/ha on average. At Cheval Blanc, they managed 30hl/ha – the same level as 2021, while at Ch. Margaux it was one of the smallest crops for a long time, with a measly 25hl/ha on average (less than 2021, 2020, 2019 or 2018). Yields tended to be more generous on plots with clay subsoils, although Durantou Reilhac found that their vines in Pomerol and Lalande-de-Pomerol suffered more than those in Saint-Emilion and Castillon, with their volumes reduced by at least a third.  Given the small and thick-skinned berries, managing extraction was key. Interestingly Durantou Reilhac found that the berries were so firm that more force was needed to extract the colour and tannin. While conventionally seed tannins aren’t desired, she highlighted how remarkable they were this year – popping in the mouth, “noble tannins” with flavours of coffee and toast, and no greenness at all.  It’s almost the opposite at Carmes, where Pouthier believes that – especially in 2022 – their passive extraction via infusion was essential. They lowered the temperature and extended the time (two to five days more than normal, at 25-26˚C versus 30-31˚C). Looking at the numbers, the level of tannins (IPT) is 15% higher than 2018 or 2020 at Carmes. Similarly, Ch. Margaux will be reducing maceration times, looking at 12-18 days rather than 15-24 and keeping temperatures cool at 25-28˚C. The risk, from Bascaules’s view, is to over-extract given the high levels of tannins.   Malic levels are remarkably low this year – the lowest many have ever seen (citing levels as low as just 0.3g/l). At Cheval Blanc, Pierre-Olivier Clouet noted that it was the highest pH they’d ever seen at 3.9. That said, the aromatic maturity is – in his words – “perfect”, with incredibly high levels of tannins that are notably “silky, smooth and ripe”. For Pouthier, the pH is similar to that of 2016 (3.6), even with the low malic levels, and at Ch. Margaux it will similarly be around 3.6-3.7.  Alcohol levels are back up to the new normal from 2021, with Cheval Blanc set to be around 14%, and levels between 14.5 and 15% across the Durantou estates, and similar at Ch. Margaux, where it’s higher than in 2018.Although potential alcohol was sitting at 14.5% at Carmes, a combination of native yeast (which is less efficient at converting sugar to alcohol) and a high percentage of whole-bunch fermentation means the final wine is likely to be closer to 13.3%.   With the uniquely dry, hot conditions, it’s hard to compare the vintage to any other – and it’s like no other year that the Durantou team remembers. Clouet fears that people will be tempted to compare the year to 2003, however it was so different. “The grapes were juicy and full this year, there was no sunburn and the vines didn’t drop all their leaves due to heat stress,” he explained. Indeed, the vines at most addresses still looked green and healthy even in mid-October. He compares it to 2009 for the silkiness and high alcohol, and perhaps 2011 for the high concentration of tannins.   Philippe Bascaules similarly thinks people will compare it to 2003, but for him it’s actually closer to 2018 – with slightly higher alcohol but also higher acidity – or perhaps 2005 and 2010. Guillaume Pouthier feels it’s impossible to compare the wines of modern Bordeaux with any other vintage, for he is part of a new generation focusing on balance and drinkability, as well as complexity and the ability to age.   Tasting the first ferments at Carmes, this is an incredibly exciting vintage. There was no sign of over-ripeness, with incredibly concentrated, vibrant fruit, and even at this infantile stage the significant tannins were silken. The year was far from easy, presenting almost the opposite challenges of 2021, and it remains extremely early to judge. Looking across the dramatic slopes of the Douro Valley, it’s easy to imagine that time has stood still here. While Port is steeped in tradition, however, recent decades have seen it leap into the modern era – with no shortage of diverging opinions about the “right” way to produce Port. Just put a handful of the region’s finest in a room and ask about co-planted or monovarietal vineyards, granite or stainless steel, de-stemmed or whole-bunch fruit, trodden by foot or machine, and feel the temperature rise as the debate unfurls.  There is, however, one element that gets surprisingly little press – the all-important fortification, an element that arguably defines Port, and until relatively recently was out of winemakers’ control. Originally spirit was added to harden the wines for long journeys in ships’ bows, preparing them for long voyages, and only became standard in the 19th century.   Once the fruit has been picked, trodden and starts fermenting, producers add spirit – or aguardente, often colloquially (and erroneously) referred to as “brandy” – to halt fermentation, thereby retaining the natural grape sugars that give Port its signature sweetness. The wine is a mere 5-6% alcohol at this stage, and the fortification brings it up to between 19 and 22%. Given the strength that the wine needs to reach, this spirit represents a massive 20% of the final product. Legally, aguardente must be a grape spirit of 77% – significantly lower in strength than the spirits used for other fortified wines (such as Madeira or Vins Doux Naturels, which use a highly rectified grape spirit of 95-96%). This lower alcoholic strength is key; meaning the spirit is less neutral, and therefore has even more of an impact on the final wine.  This spirit has a rocky history which isn’t free from scandal. After a local shortage, 1904 became known as the “Schnapps vintage” – having been fortified largely with a German spirit made from potato and grain. The 1972, ’73 and ’74 vintages saw industrial alcohol used instead of grape distillate. (Responsibility for this latter fraud fell to a French supplier who duped the unknowing Casa do Douro into buying Yugoslavian spirit.) Besides these occasional lapses, the spirit was mainly made from excess wine in the Douro during 19th and early 20th century, but in 1907 the Portuguese Prime Minister João Franco banned the distillation of wine from the Douro, meaning aguardente had to be found elsewhere. Despite presenting 20% of the wine, the spirit used today is far from local, sourced from far beyond Portuguese borders (often Spain and France).  The key date – however – is 1991. Under the authoritarian Estado Novo regime in the early 1930s, a monopoly on the spirit was established, with its supply state-controlled. This continued for over half a century, via the Casa do Douro, and then from 1976 via the Instituto do Vinho do Porto e Douro or IVDP. The freedom to choose which spirit used was only granted to shippers in 1991 – something that David Guimaraens (Head Winemaker at Taylor Fladgate) argues is one of the most significant changes in Port.  “We had no choice, the spirit quality was very average,” Guimaraens laments of the old days. He returned to Portugal, fresh from studying at Australia’s leading winemaking school Roseworthy, in 1990 – just before the shippers gained the freedom to choose their own spirit. “When you use a very clean, fine spirit, when it is young, your fruitiness comes out much more – making it more appealing in youth, almost entirely because of the quality of the spirit,” he explains. He cites two examples – Taylor’s Vargellas Vinha Velha and Croft’s Sērikos – both wines which are made from 100-year-old vineyards, made as they always have been in granite lagares. It is, he argues, only the spirit that has changed in these Ports.   For Guimaraens, the quality of spirit is most apparent in a vintage Port’s “teenage” phase – between 14 and 19 years of age, when it is starting to lose its fruit but not yet fully developed bottle maturity. This transitional phase is, in his view “much more attractive than it used to be in the past”, meaning Port drinkers are safer opening a bottle at any stage of its life. He points to 2000 as a pivotal vintage, when the quality of spirit started to really improve and produce, in his view, some of the region’s finest wines.  “Spirit has been crucial,” Richard Mayson – writer and author specializing in the wines of Portugal – agrees. “When vinification techniques were experimental – the late 1960s, ‘70s and ‘80s – you can certainly taste the poor quality spirit in the thinner-quality wines.” He explains that this period saw massive emigration and a resulting shortage of feet to tread the region’s harvests. The early autovinifiers used in lieu of the traditional foot-treading simply didn’t result in the same level of extraction – and therefore have, over time, revealed the underlying spirit quality. There are, of course, exceptions – with some great wines made. He, however, like Guimaraens, feels the 2000 vintage marked a real shift in the class of spirit used.  The uptick in the quality of spirit is one of the reasons – along with the quality of the fruit, viticulture and more – that Carlos Agrellos of Quinta do Noval feels the property has been able to declare every vintage since 2011. “It’s extremely important to choose the right one,” Carlos Agrellos of Quinta do Noval explains of the spirit. He is one of a group of 20 companies – including Niepoort – who have, over the past five years, clubbed together to buy spirit. As smaller operatives, grouping together gives them more clout, enabling them to secure higher-quality spirit for their wines – and fair prices. Each May they meet in Gaia, tasting through a selection of spirits sent over by three or four different producers – all of which are scored blind. In 2020, they tasted 20 different spirits that were approved.   The results of the tasting are shared with everyone, then each company will decide which they wish to buy for their wines. The spirits come from southern France, Spain or Portugal. There are two categories of spirit –those distilled from wine and those from wine lees. The two are very different: the former is favoured by most – having more delicate, fruit and floral aromatics; while the latter was only approved for use in 2014, and is usually stronger in flavour. While in general “wine” spirits are generally the best, the spirits from lees can offer additional complexity. “At Noval,” Agrellos explains, “we tend to blend these two and use them for different types of wine, from white Port to Tawny to Vintage Ports.” There’s no fixed blend, and it varies from year to year, but he tends to use both – with higher-grade spirits for Vintage Ports.   Symington and Fladgate – the giants of the Port trade – purchase such large volumes that they buy their spirit independently. Tom Symington – fifth-generation family member and part of the winemaking team – explains that the spirit used to be a wider cut, and today it’s narrower, resulting in a purer spirit. “We focus on the neutrality, the aromas and the way it reacts with the wine,” he says.   Talking to producers about the style of spirit they look for, there is a general consensus that neutrality is desirable – to what extent, however, varies significantly. Agrellos aims for a more neutral, but slightly floral spirit. The most important thing for him, however, is the volume on the palate: he believes that it is this volume and texture of spirit that is most important for vintage Port. “It’s what will hold the wines for years to come,” he says. He values this above and beyond aromatics, while of course looking for something very pure. It’s this texture that leads him to use some wine-lees distillate – which has much more to offer in that regard, as well as its stronger flavour. The wine distillate by contrast tends to be purer in terms of aromatics, and is sometimes even double-distilled.  While Symington uses the same spirit across all their Ports, David Guimaraens looks to use a different style of spirit depending on the style of Port in question. He is clear, however, that it shouldn’t be part of the house style – but a “neutral oenological product”. He chooses to use one batch of spirit across each style for all the houses, not wanting it to be a differentiating factor, or dominate the quality of the fruit. For example, the spirit used for his vintage wines costs twice as much as that for the most entry-level wines – “And you get your return,” he notes.  He blends his own “master spirit”, combining batches sourced mostly from Portugal and France. “In the early days, it wasn’t as simple as using a clean spirit. To get spirit we wanted, we had to get the wines fermented in a particular way,” Guimaraens explains. With an overly neutral spirit, you risk ending up with a lighter Port; but too high a component of higher alcohol and it interferes with the wine’s organoleptic character, subduing the fruit. Too many spirits are made with excess bulk wine – rather than wine that has been fermented with the express purpose of producing spirit.  Dirk Niepoort favours quality and a little bit of character. “The purest, the best, the most harmonious – but not necessarily the most neutral one” is what he looks for, he explains. At the group tastings, his tastes are reportedly well known, with many of his colleagues able to identify the aguardente he will choose. His preferred spirits are finer, lighter, with more precision, but – importantly – also character. He finds that they tend to come from France, often from Cognac, from vineyards specifically planted with the idea of producing a distillate – not just excess wine. “Our grapes are too good for distillation,” Niepoort explains – the best spirits, in his view, are made with grapes from cool climates, with high yields and high acidity. He normally chooses three different spirits, depending on availability and price, with the very best spirit reserved for his top wines. For any organic wines, of course, they require an organic distillate.   While Niepoort admits the quality of spirit has improved, he doesn’t believe that the quality was nearly as bad as some – such as Guimaraens – imply, telling me people are unnecessarily “ferocious” about it. “I think the Port Wine Institute did a fantastic job in selecting huge amounts of spirit. Considering the huge quantity needed, the average quality was extremely high.” It certainly isn’t stopping him drinking fine vintage Ports – such as a bottle of 1963 Noval he had the pleasure of uncorking recently. Nevertheless, he doesn’t deny that it was a significant step not having to buy a mass product, and it has really opened the market.  It’s not as simple as winemakers having total autonomy, however, with a strict approval system via the IVDP to ensure the quality of spirit being used meets their standards. “It’s not only complicated – it’s expensive,” Niepoort says of the process. He’s found it a struggle to get some spirits approved, with, for example, double-distilled spirits harder to get sign-off than column-distilled liquids – a clear source of frustration. While the process is clearly there to control quality, producers aren’t abusing this independence; in general they are spending more money than ever before – making the whole thing, in Niepoort’s view, futile. “We should have some freedom to do what we want,” he says.  Tom Symington feels that it’s more than just the quality of spirit that has improved the quality of Port. He believes other developments have been more significant, particularly emphasising advancements in winemaking (highlighting the introduction of stainless steel as well as robotic lagares) and viticulture, especially monovarietal vineyards which – he considers – allow them to achieve perfect phenolic ripeness, with no green or raisined fruit. It is more than just the equipment, he notes – it’s the know-how gained over time, and most importantly balancing that with tradition.  “Of course the modern young people will tell you that viticulture is much better today,” says Niepoort dismissively. He prefers to work with old-fashioned growers. Over 90% of his vineyards are over 60 years in age and traditional field blends. He feels that the shift to monovarietal vineyards – dedicated only to five of the region’s many indigenous varieties – is, along with a move toward de-stemmed fruit rather than foot-trodden whole bunches, responsible for changing the style of Port. “The wines became fruitier and darker, but at the same time, thinner,” he explains. Niepoort historically didn’t make any Port themselves, and the 1994 vintage was the first they produced in-house. For him, this shift – from the 1970s and ‘80s – for shippers to own vineyards, rather than merely buying wine in, is the greatest advancement in the region.  The Douro Valley has seen a run of top-rated vintages – with universal declarations in 2011, 2016 and 2017, and some shippers declaring 2018 and now 2019 (including Niepoort). The general rule of three declarations per decade looks set to become a thing of the past. How much can this be attributed to aguardente? Relatively little, perhaps, however it’s hard to argue that this liquid – making up a fifth of the final wine – doesn’t have a role – and depending on who you talk to, the heart – to producing the very best Port.   Read more Editorial or browse our range of Port

A spirited debate: the tale of Port’s 20%

Last year Colgin celebrated its 30th harvest. In a relatively short time, this Napa estate has become one of the most successful wineries in the region, if not the world. Its three single-vineyard wines – Cariad, Tychson Hill and IX Estate – regularly receive 99-100 points scores across the board, establishing it as one of the region’s cult Cabernet estates that has put Napa on the international fine wine map. Despite its international repute, however, Paul Roberts – Master Sommelier and Colgin’s COO – believes the estate, and Napa Valley as a whole, is still only just starting to tell its story. Napa, more than anywhere else, has been massively influenced by wine critics’ scores. While there is much fanfare over being awarded a perfect 100 points, these headline-grabbing scores have distracted from the actual reasons why this hugely heterogeneous region can produce such great wines, and that the wines themselves are distinctly varied, both in style and flavour profile. For some collectors, if a wine from Napa doesn’t have a 99 or 100-point score then they aren’t interested; however more engaged collectors are starting to identify the nuances within the region and are eager to learn more. Roberts has noticed this first-hand. “[People] don’t want to rely only on a score for guidance but instead begin to look for reasons why they really like these wines from Pritchard Hill, for instance… this is an evolution.” It reminds Roberts of a conversation he had with Dominique Lafon (Domaine des Comtes Lafon) when visiting Burgundy. Lafon said to Roberts, “When Domaine Faiveley sued Robert Parker in 1993, it was the best thing that could have happened to Burgundy. Parker left Burgundy and no other critic at the time had the influence like he did.” Lafon felt that it forced the wineries in Burgundy to focus on the story behind their wine – the characteristics of each vineyard – instead of a score. “This has to be the next evolution in understanding the great wines and the great terroirs of Napa,” says Roberts.  While Roberts emphasises that Colgin doesn’t trade on its scores, it is fortunate to have them. “But Napa is about a place – and we need to talk about this more,” he says. “The place is going to outlive you, me, Robert Parker, Lisa Perrotti-Brown, Antonio Galloni, all of us will be dead and gone, but the land abides. The place will hopefully begin to take on its own unique story, just in the same way you think Romanée-Saint-Vivant is different to Richebourg.” Tasting Colgin with Roberts, you quickly realise that for him tannins (their shape, intensity and mouthfeel) are an important aspect of understanding Napa’s different terroirs, as well as what really sets Napa apart from other Cabernet-growing regions around the world. Firstly, there’s the sheer volume of tannins. Top Napa Cabernets have higher skin-to-juice ratios than even the First Growths, notes Roberts, and therefore much more “antioxidant” tannins than their Bordeaux counterparts, vital for long ageing and development in bottle. Colgin’s mountainside IX Estate vineyard on Pritchard Hill produces berries that are, on average, 30% smaller than those grown in Pauillac and, to Roberts, have a completely different tannin profile. “While we love and enjoy drinking Bordeaux wines,” says Roberts, “Napa shoots itself in the foot every time we keep comparing our wines to Bordeaux. The climate, the terroir, the soils, they are just completely different.” When asked to describe the differences between the various regions within Napa, Roberts wants the tannins to guide you. While the reality is more nuanced, generally Roberts finds that the further south you are, the more elegant the tannin profile. In the south it is slightly cooler, something further exaggerated by the elevation. The northern part of the valley, however, produces “exotic, fleshy, powerful wines”. He finds that the mountain appellations – Spring Mountain, Howell Mountain and Diamond Mountain – produce powerful, dense, tannic, structured wines.  
Today Napa wines are often divided into those from the valley floor and those from mountain sites. While this binary division is one way to approach the geographical distinctions within Napa, but it is, Roberts feels, overly simplistic. Most importantly, it doesn’t allow for wines that are neither valley floor or mountain – the hillside vineyards, such as Colgin. 
Napa’s climate is influenced heavily by marine fog. Every day during the growing season, a layer of fog forms over the vineyards. Valley floor vineyards sit below the fog line and are protected from the full daytime power of the sun, moderating the climate. Mountain sites are above the fog line and are therefore constantly exposed to the California sunshine, which, according to Roberts, produces “a different berry structure” to the grapes on the valley floor. “The berries are smaller and have much thicker skins, very different tannins and much later picking cycles, since the mountain appellations are cooler due to elevation,” he explains.

“This cloud layer, that determines whether you are in a valley floor appellation, or a mountain appellation, tops off around 1,400 feet,” says Roberts. “ Howell Mountain’s vineyards starts at 1,400 feet; Diamond Mountain – most properties sit between 1,600-2,600 feet; Spring Mountain have some vineyards at 3,000 feet.” These then sit comfortably above the fog line and are rightly classified as mountain appellation wines. But Colgin, along with some others, Roberts believes, are wrongly considered mountain wines.

Colgin’s vineyards sit between 300 and 1,400 feet, and remain in or below the fog line. So, in some ways, they are similar to the valley floor, but, because they are on a hillside, they benefit from what Roberts calls “the devigourating nature of a hillside rocky soil”. These hillside vineyards have their own distinct climatic and geological influence – that doesn’t fit with mountain terroir or valley floor, but shares elements of both. For Roberts, Colgin’s vineyards are better described as a mid-slope hillside appellation, and it finds itself in good company.  
“If you look back at the time when we released our first vintage,” says Roberts, “we were labelled among a number of wineries as one of the cult Cabernet estates. Harlan Estate, Bryant Estate, Eisele Vineyards and ourselves – you look, and all of them are planted on mid-slope hillsides." Screaming Eagle (another cult Cabernet estate), Roberts admits, is strictly valley floor, but it is still on a slope. “A lot of people at the time said you are not going to be able to get Cabernet ripe and it’s too hard to plant in the rocky soils on these mid-slopes,” says Roberts. “But now this is where you see a lot of the great estates are situated.” “Even if you look at a famous vineyard like To Kalon,” says Roberts, “it is roughly the same size as Clos Vougeot. We all know Clos Vougeot is a Grand Cru, but within the vineyard it has some Grand Cru quality terroir, some not so good Premier Cru quality and even some village quality terroir, all within the same delineated boundary. Well, To Kalon is the same. If you get close to the road (Highway 29), it is a totally different style of wine than if you are further back on the toe of the hill where there is deeper gravel. That to me is like the Grand Cru part of To Kalon and that part, like Screaming Eagle, is on a slope, and behaves closer to a mid-slope hillside appellation than valley floor.”  The great advantage of these mid-slope hillside appellations, according to Roberts, is not only better drainage and the natural devigouration of the rocky soils, but a different ripening cycle. Because the soils are that much drier, they warm up quicker at the beginning of the season, pushing the hillside vineyards to bud earlier and to ripen more quickly than those on the valley floor and in the mountain appellations. This helps them avoid the late season rain that can disrupt a vintage. The result, therefore, is much more consistency year to year. Roberts notes that more and more producers are realising the virtues of the Napa hillsides, with the likes of Tim Mondavi now planting on Pritchard Hill. Despite demand for these hillside plots, which have proven their potential, Roberts doesn’t expect to see the “appellation” expand much more. Regulation and restrictions from California’s Land Use Law prevents any new plantings on Napa’s hillsides, preserving key natural habitats. And that might be no bad thing, since the residential properties being developed in the region and their ornamental plantings of lavender and rosemary, Roberts argues, pose a huge fire risk for the region. California faces a tumultuous future. As aquafers dry up and fires rage around the state, California sometimes feels like a perilous place that needs protecting. Colgin know the dangers only too well. On 17th August 2020, a freak storm hit California. The state saw 10,000 lightning strikes in 24 hours. One of the two huge fires that the storm caused started directly opposite Colgin’s vineyards. “Within four hours, we were in an evacuation zone,” says Roberts. “The fire couldn’t be put out by a fire crew because it was on such a steep hillside, they couldn’t get to it. All air assets had been deployed to southern California, since that is where they thought the storm would hit.” Fortunately, vineyards act as firebreaks and Colgin’s vineyards were saved – although they didn’t make any wine in 2020 because of the smoke damage. Such a close call has Roberts and his team doing everything they can to minimise the risks. A massive amount of brush clearing, putting in fire roads as well as bringing in new technology to minimize the risks. At the top of Colgin’s vineyards, Roberts recently approved a heat camera that can sense and detect the emergence of a fire, allowing them to deploy helicopters and put fires out early, before they have a chance to spread.

While these issues have become a day-to-day concern in the region, Roberts is confident Napa is turning a page in its history. If you look beyond the headlines of high scores and wildfires, Napa’s vineyards and varied terroir are starting to find a voice – and that’s where the real story is. Your guide to Colgin’s three single vineyards: IX Estate, Tychson Hill and Cariad While Colgin’s three single vineyards all share mid-slope hillside positioning and the climatic benefits this brings, the sites produce three very different styles of Cabernet, due to their different soils and microclimates. IX Estate IX Estate is an 8.07-hectare vineyard situated on Pritchard Hill overlooking Lake Henessey at an altitude of between 1,100 and 1,400 feet. The IX Estate vineyard’s bedrock is made up of old lava flow, full of iron. The soil looks red, dotted with large volcanic boulders. According to Colgin’s COO Paul Roberts MS, the iron component gives an almost sanguine nature to the tannins. “There are lots of them, but they are very, very fine,” says Roberts. “Then there is an almost bloody note – not as much as in the Northern Rhône – not full blood – not that extreme, but more mouth-watering, not from the acidity but from the flavour/nature of the tannins.” The wines from IX Estate have a distinct red fruit profile on the palate which is a classic element of this part of Napa. The wild flora and fauna around the vineyard, to Roberts, “add an almost herb component, as close as you get to garrigue in the south of France – thyme, rosemary, wild sage.” Tychson Hill Tychson Hill is an historic vineyard site, first planted in the 19th century. The vines were pulled out during prohibition, with the site only replanted by Anne Colgin in the mid-1990s. The vineyard is north of the town of St Helena at an altitude of 300-422 feet. In total 2.42 hectares are planted to vines. The bedrock is also volcanic, but with a very different volcanic origin to IX Estate, with a mix of gravel and obsidian black stone (a black volcanic glass). According to Roberts, the wines from Tchyson Hill has less tannin than IX Estate and they are rounder, without the edges you get in IX Estate. “The tannin quality of the wine begins to emulate the shape of the stones you find in the vineyard,” says Roberts. “Tychson Hill is a much older material – so a finer quality of tannin.” The diurnal shift at Tychson Hill also has a distinct effect on the wines, with a shift of up to 9-10˚C – which provides much more aromatics and more red fruit character. “The climate can fully volatilise and metabolize tannins,” says Roberts, “so they appear much softer.” It is also, he believes, Colgin’s most approachable wine in its youth. Cariad Cariad is a steeper vineyard site, 3.2 hectares in the western hills of St Helena at an altitude of 400-500 feet. The vines are grown on what is an uplifted, old gravel riverbed. The tannins, according to Roberts, are “more spherical because of the rounded stones in the vineyard”. The fruit is more purple in character. Earlier vintages of Cariad were a Cabernet Sauvignon/Merlot blend that typically was the slowest maturing of the three, needing the longest time for the tannins to fully integrate, but today much of the Merlot has been replaced with Cabernet Franc, which Roberts believes brings a much “fleshier beauty” early on in its maturity.
