The Thienponts reign over Bordeaux’s Right Bank. At Vieux Château Certan, Alexandre Thienpont – almost always dressed in his Barbour – rules, producing Pomerol of immaculate pedigree, as his family has for over a century now. Nearby, cousin Jacques Thienpont holds court at Le Pin, Pomerol’s original cult address. Nicolas Thienpont is another cousin whose domain stretches out from Saint-Emilion – from Pavie Macquin and Larcis Ducasse across to several estates in the Côte des Francs. And the dynasty continues to grow, as each thread of this complex family finds a new corner of the region to master.  The Flemish family has a long history in the world of wine, having traded French wine (especially Bordeaux) since 1842. Georges Thienpont – grandfather of Jacques, Alexandre and Nicolas) was the first to move into production, buying Ch. Troplong Mondot in 1921, then Vieux Château Certan in 1924. It wasn’t long before the Great Depression hit, however, and Georges Thienpont was forced to sell Troplong Mondot in 1934. Reportedly the only reason he kept Vieux Château Certan was that no one wanted to buy it – with vines holding little allure at the time. It was the château itself at Troplong Mondot, positioned at the highest point in the region and with a view across the village of Saint-Emilion, that allowed him to sell the Saint-Emilion estate. Georges continued to make wine through the Second World War and the devastating frost of 1956. Despite a challenging start, “VCC” (as it is affectionately known by wine-lovers) has become one of Bordeaux’s leading names.  It was Jacques Thienpont, however, who thrust the family firmly into the limelight. It was in 1979 that Jacques, then still a Belgian wine merchant, purchased a 1.6-hectare vineyard in Pomerol. The site had produced generic Pomerol, but Jacques started making tiny volumes of opulently styled wine, naming it after the lone pine tree (“le pin”) that stood on the property. The 1982 vintage was pivotal, receiving significant critical acclaim – especially from Robert Parker – and soon Le Pin became one of the world’s most desirable wines.  Just over 30 years after that first vineyard purchase, it seemed like fate when Jacques went to see a plot of land in Saint-Emilion right next to Troplong Mondot. Previously known as Ch. Haut-Plantey, the potential of the site was clear to Jacques and the symmetry of the Thienponts returning to where their family’s winemaking legacy began seemed fitting. He bought the property in 2010 and put Cyrille Thienpont (his cousin once removed) in charge of its daily running. In keeping with the arboreal theme, he named the Saint-Emilion venture L’If (the yew tree).  The first project the team undertook was a detailed soil map to get to grips with the site. The winery is in Saint-Laurent-des-Combes, just to the east of Troplong Mondot, with five hectares of vineyard around it and another two hectares of west-facing vines next to Saint-Hippolyte. The lower parcels are more eroded and sandier, but much of the vineyard sits on pure limestone and clay. They set about restructuring the vineyard – getting rid of the 5% Cabernet Sauvignon and increasing the portion of Cabernet Franc, with around 25% across the property today (any new plantings were with a massal selection from Pavie Macquin).  In 2013, Jacques bought another hectare or so of vines in Saint-Etienne-de-Lisse, right next to Ch. Puy-Blanquet. Despite the quality of the soils, Jacques was hesitant about buying such a “distant” plot, a whopping three kilometres as the crow flies – or a circa 10-minute drive. They pulled the vines out and replanted this additional parcel, harvesting its first fruit in 2018. Despite its youth, the fruit from the plot has made it into the final blend for every vintage of L’If since 2020 (“Worth the trip,” jokes Cyrille). Even with the significant replanting and this new plot, the average age of vines across the estate is around 40 – with the oldest over 60 years in age.  Work on a new winery finished just in time for the 2023 harvest, allowing greater precision and flexibility – with more space to work (and 16 concrete tanks for their eight hectares of vines). You might expect a flashy building, perhaps designed by a famous architect – but that’s not the Thienpont way. Understatement is everything for this family – and the winery is an almost exact replica of what stood there before, simply with more space inside, designed for simple functionality. In one corner stands an otherwise anonymous stainless-steel tank – the first one that Jacques bought for Le Pin back in 1979.  It was perhaps inevitable that L’If would sit in Le Pin’s shadow. But now, 15 years after Jacques Thienpont bought the estate, with a new winery and the significant work in the vineyards completed, L’If is building its own reputation.  Although the same team is largely involved in both estates, L’If is a totally different site and wine. The cool soils have better water-holding capacity, and budburst is around 10 days later than at Le Pin with its warm free-draining gravels – a gap that often widens as the growing season progresses, meaning harvest is significantly later here. Diana Berrouet Garcia – who acts as Managing Director for Domaines Jacques Thienpont, including both Le Pin and L’If – notes how at L’If the terroir seems to speak louder than the vintage and can better adapt to more challenging conditions, while the vines can struggle – especially in hot, dry years – at Le Pin. Where Le Pin is round, supple and exotic, L’If is linear, taut and mineral; one sensual and spherical, the other just on the right side of severe, with a crystalline quality. Even in the last few years, it’s amazing how the wine is evolving – nipping at Le Pin’s toes in terms of quality. Re-tasting the 2019, it’s amazingly approachable with a perfumed nose and juicy, pure fruit that complements the wine’s natural tension.   It's still comparatively early days for L’If –  and the team has invested significantly, focusing on shaping the vineyard and ensuring they have the tools in the winery to translate the work in the vines. For now, over half the vineyard is being used for the second wine, Les Collines d’If – something that will change in time, as they continue to replant parcels. As it happens, yews grow incredibly slowly – but are also some of the longest-living trees (Perthshire in Scotland is home to the Fortingall yew, thought to be 2,000-3,000 years old and one of the oldest trees in Europe). The Theinpont family is just settling in at L’If, but as they lay down roots, the potential is clear.   The Thienpont family: who does what?  Jacques Thienpont: Owns Le Pin, L’If and L’Hêtre (the latter with his sister Anne de Raeymaeker), but is also a co-owner of Vieux Château Certan. He oversees the family’s original Belgian wine merchant business, the Belgian Royal Warrant-holding Thienpont Wine, which is managed by his wife and award-winning wine writer Fiona Morrison MW.  Alexandre Thienpont: Co-owns and manages Vieux Château Certan with his son, Guillaume, as well as co-owning Le Pin with Jacques. Alexandre and Guillaume also farm the vines at Le Pin, L’If and L’Hêtre, as well as Vieux Château Certan.  Guillaume Thienpont: Manages Vieux Château Certan with his father, Alexandre, as well as making L’Etoile and Les Fillottes with his second cousin, François Thienpont. He also now manages Ch. Exploring L’If: Le Pin’s Saint-Emilion sibling 

It’s not every day that you get to taste wines made over half a century ago – but earlier this month I got to trace CVNE’s flagship Imperial Gran Reserva all the way back to the 1947 vintage. Victor Urrutia, the fifth generation of his family to take the helm of this legendary Rioja producer, put together a tasting of what he called “the dirty dozen” – lining up 12 vintages of Imperial. The wines were chosen to show how the wine speaks across a range of vintages – not just the most famous, but the hot, the cold, the mighty and the mediocre.  CVNE has been making wine in Rioja Alta since 1879, so – even going back to 1947 – this tasting offered just a snapshot of its history. Imperial was created in the early 20th century (1917 is the earliest vintage Urrutia himself has tasted), conceived as “super Rioja”, Urrutia explained. The idea was to make the best wine possible, regardless of its commercial potential, at a time when Rioja didn’t have the prestige of today. Around 50,000 bottles are produced, but – importantly – Imperial isn’t made in every vintage, with the quality of the fruit in some years not meeting CVNE’s stringent standards (there was no 2003, 2006 or 2013, for example, and there won’t be a 2023 either).  For Urrutia, the goal with Imperial now is to reflect each vintage, and fine-tune the wine rather than look for revolution. The early vintages are their benchmark and inspiration. Across the vintages, however, Urrutia points to a “churchy” nose – something he finds is distinctly Imperial and reminiscent of the winery.  It’s easy, perhaps, to forget how well Rioja ages – and not just over a decade or two, but over half a century. The oldest vintage in this tasting, the 1947, was undoubtedly the star – a wine that has retained its freshness, with delicate aromatics and a beautifully long, pure, resolved palate. The entire flight impressed – with the quality of Imperial shining through. Some of Rioja’s legendary vintages featured (the 1970 and 1959, which sit alongside the likes of 1982 and 1964 in the history books), but my personal favourites were the aforementioned 1947, the still compact 2004 (named Wine Spectator’s Wine of the Year in 2013), the brooding 2011 and pretty, elegant 2018.   The Imperial vineyards  The fruit for Imperial Gran Reserva comes from CVNE’s best vineyards, all over 40 years in age and almost all bush vines, yielding around 4,000kg/ha (equivalent to circa 25hl/ha or less than 1.5 tons/acre). The parcels all sit close to the Cantabrian mountains, at around 500-600 metres’ altitude, and on poor but cool soils (clay and limestone) – lending the wines great freshness, even in hot and dry years, explains longtime Technical Director María Larrea.  The village of Villalba de Rioja has been the backbone of the wine since its conception. This village was where the Real de Asúa brothers (who founded CVNE) first bought vineyards, four kilometres from Haro. The vineyards are steep and south-facing, exposed to the winds and some of the vines therefore have to be trellised (cordón Royat), but it brings acidity and freshness to the wine – something that is essential for its ageing potential. Parcels in the villages of Briones and Torremontalbo were added later, in the 1960s. Briones has richer soils, gentle slopes and a warmer climate, giving structure and body to the wine, while Torremontalbo has steep, stony slopes with calcareous soils and a significant diurnal shift, adding minerality and finesse to the blend.  The Imperial blend  The blend has shifted over the years, with the wine originally around 40% Garnacha and 40% Tempranillo, with the remaining 20% Graciano and Mazuelo. The old vineyards were field blends, with the varieties interplanted and harvested together, meaning mixed ripeness levels – something that arguably brought balance and complexity to the wines, even if some of the fruit wouldn’t have been ripe. Nowadays, each variety is planted separately at CVNE – allowing them more control and precision, harvesting each grape at the perfect moment and crafting a blend in the winery.  There was a move away from Garnacha in the 1970s, with more and more Tempranillo planted instead. Garnacha was less appreciated, seen as a workhorse, an impression that was only reenforced when lesser, high-yielding clones were planted in the 1980s and 1990s. As Larrea also noted, Garnacha is much more prone to coulure and millerandage (poor flowering and fruit-set), which may have been another factor in its decline. There was also a time, Urrutia explained, when Bordeaux was the reference point for fine wine, and they looked to imitate the region, favouring Tempranillo for its darker colour versus the more thin-skinned and therefore pale Grenache. Today, the blend is dominated by Tempranillo (with the 2017 and 2018 Imperial both 85% Tempranillo), but Grenache is undergoing a revival across Rioja and – provided they can have the right clonal material and/or older vineyards – it may contribute more to the blend in time.  The proportion of Graciano and Mazuelo has been reduced slightly, but Larrea emphasises how important the two grapes are in the face of climate change. Mazuelo (aka Carignan/Cariñena) provides structure and colour, while Graciano contributes acidity and aromatic complexity.  The winemaking  Although she joined CVNE in 1991, María Larrea took over the winemaking for Imperial with the 2005 vintage, following on from Basilio Izquierdo, who had been running things for over 30 years (since 1973). Before Izquierdo came Ezequiel García, known as “El Brujo” (“The Wizard”), winemaker for CVNE for over three decades (he returned briefly in 2014 to recreate their legendary white, Monopole).  Across the three winemakers and almost 70 years, surprisingly little has changed. The winemaking here remains extremely traditional, although technology has allowed the team to monitor the wines more closely, and for better winery hygiene, as in most regions. Fermentation remains indigenous, although it’s no longer spontaneous – the wines have been inoculated with a selected strain of their indigenous yeast since the early 2010s (with some experiments in the 1990s). Traditionally fermentation was in concrete tank, however this moved to oak in the 1990s, with one lone vintage (1994) fermented in stainless steel when the vats hadn’t arrived in time.  The wines used to be stored in barrel and only bottled when they were sold, so some older vintages of Imperial spent over a decade in barrel, while today the wine normally stays in barrel for between two and three years. (The bottling dates for each of the vintages is included below – the 1947 wasn’t bottled until 1960!) Originally the oak was all American, simply because that is what they had access to via their historic trade routes, and the barrels were kept for decades (Larrea remembers using 40-year-old barrels when she arrived in the 1990s). CVNE gradually started introducing French oak in the 1980s, with around 30% French oak used in the 1990s and around 60-70% today, with the remainder American.   The wines: tasting eight decades of CVNE Imperial  A note on the bottles themselves: older vintages are in green glass, however they moved to brown glass around 10-15 years ago.  2018 Imperial Gran Reserva: This was a real highlight of the vertical. It is very youthful still, fruit-forward, yet with amazing finesse and delicacy. The nose is precise with dainty aromatics of spice, graphite and florals alongside the crystalline fruit. The palate is juicy and lithe, pure, silken and fresh with savoury tobacco and dried red berries filling the mouth-watering finish. Beautiful and very open, even now. Fermented in oak, 14% alcohol and bottled July 2021.  2017 Imperial Gran Reserva: Frosts swept across much of Europe in late April in 2017, although the rest of the season was relatively warm, producing a tiny crop of concentrated fruit. It’s a drastically different wine to the 2018, yet still with great freshness and a floral lift alongside ripe, sweet red fruit. The palate is tight, much less approachable than the 2018, with compact tannins, a bite of crunchy acidity and a grip of firm tannins, while smoky tones that fill the finish. Decant to enjoy now, but this will be even better with a couple more years in bottle. Fermented in oak, 14% alcohol and bottled July 2020.  2015 Imperial Gran Reserva: The 2015 Imperial is dark and intense, layered with rich bramble fruit, cedar, tobacco, spice and something meaty – a hint of biltong, perhaps. The palate echoes the concentration of the nose, with chewy tannins and a line of acidity that cuts through its intensity. Powerful, almost stern, with more dried fruit coming out with air, the finish is long and savoury, with a touch of red miso. Fermented in oak, 14.5% alcohol and bottled June 2018.  2011 Imperial Gran Reserva: Another standout in the vertical, the 2011 Imperial offers a dark and pure nose, still surprisingly primary with black cherry and cassis fruit, lifted by sweet spicy perfume. The palate is silken and pure, still so youthful, flowing across the tongue, framed by firm but integrated tannins. It’s concentrated and long, with floral aromatics dancing on the juicy finish. Hard to resist with great balance. Fermented in oak, 13.5% alcohol and bottled July 2014.  2009 Imperial Gran Reserva: This is a very serious Imperial now at a lovely stage of maturity – with savoury undergrowth and spicy notes sitting alongside the vibrant dark berry fruit. The palate is intense yet with a softness to it, despite the chewy framework of tannins. It’s juicy and expressive, with smoky, spicy, tobacco notes playing on the finish, and just the slightest hint of leather starting to appear. Fermented in oak, 13.8% alcohol and bottled January 2013.  2004 Imperial Gran Reserva: From “a textbook vintage” in CVNE CEO Victor Urrutia’s words, the 2004 is shining. Pencil shavings and bacon complement ripe, dark fruit. The palate is tight and compact, yet with a juiciness that elongates the whole thing, with acidity that drives through to the long finish. The tannins are supple and soft, integrated with the fruit, but still offer a grip on the finish. Bright and effortlessly balanced. Fermented in oak, 13.8% alcohol and bottled October 2008.  1994 Imperial Gran Reserva: This is an intriguing vintage of Imperial, the only one ever to have been fermented in stainless steel as they were switching from cement to wood, but the new vats didn’t arrive in time for the vintage. It was also served at the wedding of Spain’s Crown Prince, who later became King Felipe VI. After the 2004, this marks a shift towards wines dominated by tertiary notes, although there’s still plenty of fruit here. The nose is spicy with mushroom and undergrowth alongside incense and leathery tones. The palate is laden with umami – with fresh leather and dried berry fruit – as well as dried strawberries, supple tannins and refreshing acidity. Fermented in stainless steel, 13.16% alcohol and bottled June 1998.  1980 Imperial Gran Reserva: As CEO Victor Urrutia said, 1980 was “a shit vintage” – and has always been in the shadow of 1981 and 1982. Tasting the wine today, that’s probably fair – however it’s still an impressive wine. The nose has a distinctly herbal, menthol edge to the sweet fruit – macerated strawberries, with a balsamic hint. The tannins still offer bite, while the fruit shifts to darker, more bramble tones towards the finish. Fermented in concrete, 13.4% alcohol and bottled May 1985.  1970 Imperial Gran Reserva: The 1970 vintage was hot and produced powerful wines – earning it a reputation as one of Rioja’s finest vintages. After over 50 years, the wine is intensely savoury – combining soy, marmite and barnyard tones with intense, dark fruit. With air, the wine offers layers of spice (almost reminiscent of paprika), bacon frazzles and smoked almonds, complementing the concentrated core of fruit. It’s intense yet balanced, with bright acidity that keeps everything fresh and fills the long finish. Fermented in concrete, 12.97% alcohol and bottled March 1975.  1968 Imperial Gran Reserva: From a more difficult vintage, the 1968 Imperial has a charming nose that seamlessly combines savoury and sweet – with earthy richness that sits alongside incense-inflected berry fruit and a pleasing herbal note. The palate is elegant and vibrant, with plenty of fruit still driving through its core, while more savoury, smoky notes dominate the finish. Fermented in concrete, 12.7% alcohol and bottled April 1974.  1959 Imperial Gran Reserva: The 1959 vintage is another of Rioja’s most lauded, although I suspect this bottle was not showing its best. There’s a plushness and intensity to the palate, with a sharp drive of acidity, while the nose is dominated by leather, black liquorice and barnyard. Fermented in concrete, 13% alcohol and bottled February 1968.  1947 Imperial Gran Reserva: An amazing wine to tasted, the 1947 CVNE Imperial has a reputation – one that this bottle more than lived up to. Coffee and tobacco notes with bright fruit – ripe red cherry and raspberry, as well as florals, incense, black tea and sage, alongside smoky perfume. It’s long and fresh on the palate, seamless and fully resolved but pure and persistent, with a Bovril edge to the finish which is vibrant and long. Gorgeous now – drink it while you have the chance. Broad in build and sporting a leather necklace, Mike Ratcliffe looks like a man who would be good at wrangling cattle. But that burly side is countered by an accent softened by time working and studying abroad (not to mention being married to a Brit), and a certain polish – even after an overnight flight from the Cape – that speaks of the business sphere. It’s clear that he’s no-nonsense – a man with ambition, and not one, I suspect, you’d want to get on the wrong side of. But it’s also clear that his savvy brand-building has been key to the success of Vilafonté.  He is a man with a plan – a 100-year plan, in fact. As of December last year, when co-founders Dr Zelma Long and Dr Phil Freese retired, Ratcliffe is the lone man at the helm of Vilafonté – a wine producer that has been attracting increasing amounts of attention. In a recent report for the Wine Advocate, Anthony Mueller wrote, “Vilafonté continues inching toward triple digits with a spectacular array of new releases” – awarding its 2021 Series C 99 points (making it the joint-highest-scoring South African wine to date, sitting alongside Sadie’s 2021 Palladius and an 1800 Muscat of Alexandria from Jaubert). But Ratcliffe’s not resting on his laurels: as he tells me, “If you’re going to do anything, go 100%.”  Ratcliffe’s family owned Warwick Estate – and as the world opened up to South African wine in the wake of apartheid – they realised they needed help developing their wines. Although Warwick was one of the nation’s stalwart names, “We were the big fish in the small pond,” says Ratcliffe – and to grow internationally, they needed outside input. They hired Phil Freese – then Vice President of Winegrowing at Robert Mondavi and responsible for planting the first Opus One vineyards – as viticultural consultant (for a “staggering” fee, Ratcliffe tells me). The investment paid off and after two years, they had made amazing progress – and Freese suggested they use Zelma Long (previously of Robert Mondavi, then Simi) to consult on the winemaking side.  At the same time Freese was working on his PhD, which involved research on the world’s oldest soils – many of which he discovered were in southern Africa. The oldest documented soil in Africa is vilafontes, thought to have originated 800 million years ago – and he, along with Long (whom he later married), started wondering about this soil’s potential for wine. The couple – along with the help of an investor Sydney Back – bought 40 hectares of land in 1996, at the foot of the Simonsberg mountain in Paarl, planting their first vines the following year. Vilafonté was born.  Ratcliffe had been working abroad as a skipper, before heading off to Roseworthy to get his MBA in wine in 1999, but had met Long and Freese through their work at Warwick, and was keeping an eye on their new venture. Soon after he returned back home, Sydney Back – a man Ratcliffe describes as “the Robert Mondavi of South Africa” – passed away, meaning Long and Freese were looking for a new partner. Impulsively, Ratcliffe volunteered – scrambling to get the money together in time for the deal to be finalised in 2001.   The trio made wines in 2000 and 2001 but only to get a feel for the site, planning to make 2002 their first release. Unfortunately, the vintage was tricky and Long told them firmly: “It’s good – but it’s not good enough.” It’s a decision that the bank didn’t necessarily appreciate (“That was a tough year,” says Ratcliffe) – but allowed them to launch with 2003, “arguably the best vintage of the decade” according to Ratcliffe (and a wine that he tells me is still “impeccable”). No one seems to be clear on how “vilafontes” became Vilafonté – whether it was a marketing decision to add a Gallic twist to the name, or just a mistake somewhere along the way – but it stuck.  They had originally planned to make a single Grand Vin, but the site had other ideas – producing two distinct styles, and so they created Series C (a Cabernet-driven blend) and Series M (a Merlot-driven blend). It may not make perfect business sense, having two flagship wines, but repeat experiments have (so far, at least) confirmed it was the right choice. While some plots clearly belong to C or M, the blends are different each year – and younger-vine fruit or anything that doesn’t fit is declassified to Seriously Old Dirt. This latter wine was launched with the 2012 vintage, using purchased fruit from around the Western Cape as well as declassified plots to provide an earlier-drinking entry-point to the Vilafonté brand.   The secret to the wines is the soil – incredibly poor, ancient soils, degraded and nutrient-deficient – meaning the vines really struggle. Even 27 years on, the vines are scrawny little things – producing tiny yields of concentrated fruit. It’s one reason that the site had – to their knowledge – never been planted, and local farmers were puzzled why anyone decided to put down roots here. Combine that with a “deeply pragmatic” approach (in Ratcliffe’s own words), and a long-term team dedicated to doing “the same thing over and over and over”, and you have the recipe for something special. In Ratcliffe’s mind, it’s key that they aren’t trying to create something new each vintage – but continue their pursuit of perfection with Series C and M. They work sustainably but sensibly, with cover crops, high-tech underground drip irrigation and a cellar that operates purely on solar power, but avoid certification or trading on any green credentials: for the Vilafonté team, it is all about the quality in the bottle.  For years, Ratcliffe juggled managing both Warwick and Vilafonté, but eventually sold his old family business to a California-based venture capital fund, allowing him to focus exclusively on Vilafonté. The property has just released its 2021s, the 18th vintage to emerge from the Paarl estate – and its top-scoring wines to date. Yet Ratcliffe is clear that this is just the latest step in his masterplan. The vines are yet to turn 30, and there are a few small parcels on the estate that could still be planted, while the team is constantly running trials – empowered to challenge everything they think they know. Just last December (2023), Long and Freese retired – after a four-year handover period, but will remain loosely involved. Walking into the cooperage at Ch. Smith Haut Lafitte is like stepping back in time, filled with the smell of seasoned wood, an open fire and the same tools that barrel-makers have used for centuries. Few estates have the luxury of an in-house cooper. While producers inevitably work closely with the tonnelleries (barrel-making firms, such as François Frères, Stockinger and more), having an artisan on-site, working alongside the winemaking team to craft casks exclusively for your specific terroir is different. “It’s very important for the precision of the wine,” explains Cellar Master Yann Laudeho.  Florence and Daniel Cathiard, owners of the Pessac-Léognan estate, built a cooperage on-site almost 30 years ago, in 1995, and their current cooper, Yann Dez, has been working here since 2021. The Bordeaux native’s father was a metal worker, and Dez fell into the world of barrel-making entirely by accident – having a friend who was a tonnelier, and a job opening at an opportune moment. Before he knew it, Dez had learnt the trade from some of the best coopers in the country (including one who now makes the barrels at Ch. Margaux), and spending 15 years working under Didier Fesil. Fesil was the Cathiard family’s first cooper back in 1995, who went on to create his own small tonnellerie (Tonnellerie Bordelaise), and has been named the nation’s best “Master Cooper” – twice. Indeed, Fesil is still very involved with the estate, helping choose the wood for barrels and advising on all things oak; and it was Fesil who put Dez forward for the role at Smith Haut Lafitte.  “There are no books,” Dez says, when I ask about the art of barrel-making. “It’s passed on from tonnelier to tonnelier." The first evidence of coopering as a trade dates back to 900BC – with the craft passed down the generations ever since. “I continue the tradition,” Dez says, clearly with a sense of pride in this ancient, artisanal skill. But with the dust, noise and physical labour involved, tonnellerie schools, Dez tells me, are struggling to recruit young people. It’s common for coopers to have issues with their shoulders and ears (from the non-stop hammering) – and Dez himself has broken an elbow.  In theory, the process can be mechanised – but Dez is clear on how important it is to work by hand, and not just to preserve this ancient art. “I hear the nose, I feel the resistance,” he says. Each barrel, he explains, is different – with a slightly different number of staves and slightly different shape, all adapted according to the wood he’s working with. Selecting the right wood is key – “reading” it, he explains, looking at the grain to see where potential weaknesses are, understanding where will take the most pressure and placing each stave accordingly, ensuring not a drop can seep from the finished barrel. “It’s a job that is both physical, and at the same time requires thinking,” says Dez – and this combination is much of its allure for him.  Hearing the way Dez talks about barrels is fascinating; for him, they each have a unique personality. When I ask Dez how he knows he’s made a really good barrel, he shrugs: “On le sent.” (“You feel it.”) As you toast a barrel, he tells me, the scent of the smoke changes, releasing different aromas – something I smell as he works in front of me. Knowing when it’s spent the perfect amount of time over the fire is the secret – and it’s about more than just the smell, it’s a gut instinct that he can’t quite explain.  Smith Haut Lafitte sources oak from a range of forests, and are always trialling wood from different forests, toasts and doing blind tastings, although – after over 25 years – they know what works for their wine, and terroir. Cellar Master Laudeho explains that, for him, Tronçais and Jupilles are the best – “diamonds” that flawlessly complement their site. And that balance is key; the wood works for the wine, not the other way around.  It seems like a lonely job, I comment, hammering away in his tower – but it’s not something that bothers him. “I’m a bit of a perfectionist,” he tells me. Having only himself to depend on, and knowing that he can ensure each barrel meets his exacting standards, suits him. Indeed, he doesn’t even settle for standard tools – making most himself, custom-designed to suit the way he works. He talks me through a specific hammer that he made, and how it allows him to work better and more precisely, the wooden handle almost silken from the hours of use, shaped to his hand.   The lone electronic technology to have earned a place here are noise-cancelling headphones and a Marshall speaker. He’s a musician in his spare time, and an additional perk of working alone is that he gets to spend all day listening to music. “All the barrels I’ve made,” he says, “are made with music.” He avoids anything too modern or electronic, favouring old jazz, with some reggae, ska jazz and funk in the mix, depending on the day. While he doesn’t feel the music he listens to influences his coopering, he suspects his mood does – and music is a big part of that.  Woodwork is much more than a job for Dez. I spy a beautiful chest alongside his speaker, and it’s one that he made. He has a workshop at home too, spending his free time making everything from guitar stands and toys to chandeliers – anything, he says, that isn’t straight, and therefore can’t really be done by a machine.  It’s amazing watching him work – in the same way as coopers have for centuries – with a natural intuition, ease and precision. There’s definitely something musical to it, a craft that has its own rhythm. He makes around 300 barrels a year, and they may not be soloists – but each one contributes their own note to that year’s symphony.  Explore all current listings of Ch. It’s 20 years since Eduardo Chadwick gathered some of Europe’s most famous wine writers for a blind tasting – one to rival the famous 1976 Judgement of Paris (when California proved its wines could compete with – and beat – France’s best). Chadwick was convinced that critics were underestimating Chilean wines – for no reason other than snobbery against the nation. The Berlin Tasting pitched Chadwick’s top wines (Viñedo Chadwick, Seña and Don Maximiano Founder’s Reserve) against Bordeaux’s First Growths and a lone Super Tuscan (Antinori’s Solaia). Chadwick charged the late Steven Spurrier with running the event. “I never imagined that what happened was about to happen,” Chadwick tells me. To his and everyone else’s amazement, the 2000 Viñedo Chadwick took the top spot, followed by 2001 Seña, then 2000 Ch. Lafite Rothschild, and 2000 Ch. Margaux – tied equally in fourth place with 2000 Seña. Finally, there was proof that Chile’s wines deserved a place on the world stage.  But, for Chadwick, one watershed moment wasn’t enough. He repeated the tasting, first in São Paulo, then Tokyo – and onward, hosting the same blind tasting 22 times around the world, all with similarly spectacular results for his wines. It takes nerves of steel – and a certain amount of ego – to be willing to risk repeating such a tasting, and yet Chadwick was justly rewarded. His campaign is just one way in which he has forged a path for fine, Chilean wine – with a relentless, dogged determination.  Chadwick is the fifth generation of his family to make wine in Chile. Don Maximiano Errázuriz emigrated from the Basque country and was the first to plant vines in the Aconcagua Valley in 1870. He identified the location, 100km north of Santiago, with its cool ocean breezes, hot summers and rainy winters, as perfect for growing grapes. Operating under the motto of, “from the best land, the best wine”, he planted vines in this idyllic site, near Panquehue, and built a winery – that still stands today.  Gradually, the business grew – and it became the largest vineyard in the world owned by an individual, with 1,300 hectares under vine at its peak in the late 19th century. Despite this early prosperity, Chile’s wine industry didn’t continue to thrive. There was no export market and domestic consumption (which reached up to 80 litres per capita annually) was slashed by severe taxation, while political and economic turbulence, with communist then military rule, put not just the industry, but nation, in crisis. By the early 1980s, wine was cheaper than water and around half of the nation’s vines were ripped out.  It was onto this unstable scene that Eduardo Chadwick arrived. He had initially trained as an industrial engineer before deciding to focus on wine instead, going to study in Bordeaux under the legendary oenologist Emile Peynaud. His father bought the family winery back from the banks, and Chadwick started dusting away the cobwebs, re-opening Viña Errázuriz and – armed with new, technical knowledge – made the first vintage of Don Maximiano Founder’s Reserve, the property’s flagship wine, in 1984. The operation was still rudimentary – with rauli vats (a native hardwood), no temperature control and pergola vines planted on the fertile flats – but it was an early indication of what was possible. Tasting the wine four decades later, it’s held up remarkably well – with surprising vibrancy on the nose and a chiselled, savoury profile of pure Cabernet Sauvignon.  Gradually, Chadwick invested in equipment – stainless steel tanks, modern presses and barrels – and started to plant vineyards on slopes with poorer soils. Alongside this shift, pivotal elections in 1989 saw Chile become a democracy once more – and key figures from the world of wine visited. Soon entry-level wines were being exported by the likes of Oddbins and Victoria Wine. The doors had opened for Chilean wine. Robert Mondavi visited Chadwick in 1991 – and the two men hit it off, sharing an unrelenting drive to push their industry forward, and Mondavi recognised in Chile the potential he had seen in Napa in the 1960s. He knew that his partnership with Ch. Mouton Rothschild (Opus One) had been key to changing Napa’s reputation – and the duo hoped that their own joint venture might do the same for Chile: Seña (literally meaning “signal”) was born. Bob’s son, Tim Mondavi worked with Chadwick on the project and suggested looking for a site closer to the coast in the Aconcagua Valley, in search of even greater finesse, producing the first vintage in 1995.  And Chadwick didn’t stop there. His father had purchased an estate in the Alto Maipo in 1945, home to a polo field (Eduardo’s father, Alfonso, had captained the Chilean team for years). In 1992, Chadwick convinced his father to let him transform the polo field – with its pure gravel soils and 15˚C diurnal swing – into a vineyard, feeling it was perfect for Cabernet Sauvignon. Alfonso died the following year, but the first vintage of this project – Viñedo Chadwick, named in honour of his father – was made in 1999.   Chadwick knew the wines were good – but convincing the world of that fact was the challenge. He’s clear that Chile made a major error in churning out great-value, entry-level wines – good, but not fine wines – a price-point that came to define the nation. “That’s why it was very difficult to convince the audience that we can also produce world-class wines,” says Chadwick. “Chile had no recognition. We had no ratings, no Parker points, no Suckling points.” And so he set about changing that with the Berlin Tasting.  With that event’s market-shifting results (then echoed around the world), he’d created momentum for change. A decade later, he went on to break through another boundary: the 2014 Viñedo Chadwick became the first Chilean wine to earn 100 points (from James Suckling). Just last year, the 2021 vintage was the first Chilean wine rated 100 points by the Wine Advocate. When I sat down with him March this year, it was at an event paying tribute to the two decades that have passed since the Berlin Tasting – featuring early vintages from each estate, and their greatest successes. The 1998 Seña was a particular standout – a cool vintage that today is perfumed, elegant, bright and effortlessly long. Any doubters of Chilean wine were instantly quieted. And, as with the Berlin tasting, the event was being replicated around the globe – the campaign to champion Chilean wine never ending.  When Chadwick started in 1983, Viña Errázuriz had just 10 hectares of vineyard. Today, across their estates, Chadwick farms 900 hectares of vines. He bought out his siblings years ago, when he found they were more interested in dividends than growing and investing in the business. Now three of his four daughters are working alongside him – excited by the potential of coastal sites (where they make the Las Pizarras wines) and a new sparkling project. There has been no shortage of challenges along the way, but they’ve only fuelled Chadwick’s relentless pursuit of recognition for Chile and its wines. “Where we are today is beyond my wildest dreams,” he tells me, and yet it’s only because of his tireless ambition that Chilean wine has made it to this point. “We take risks every day,” Vanessa Martin says to me. If you didn’t know we were standing in a winery, you might think Martin was a fighter pilot, a firewoman or perhaps a double agent. The two women standing in front of me, Martin and her colleague Chantal Uldry, aren’t necessarily the image of risk-takers – but through their hands have passed thousands of bottles of one of the world’s most precious wines: Ch. d’Yquem. It might not be life or death, but this liquid is so prized that it can seem it.  The lone Sauternes or Barsac estate to be declared a Premier Cru Supérieur in 1855, Ch. d’Yquem has a long history stretching back to the Middle Ages. The wine crafted from this property, at the highest point in Sauternes, has been lauded for centuries. It was savoured by the likes of Thomas Jefferson in the 1800s, while Jay-Z and Beyoncé visited late last year. The property and its wines are the stuff of legend, sought out by wine lovers and collectors around the world.  Production of this sweet nectar is painstaking – the vines cared for meticulously through the year, and the fruit only harvested if Mother Nature provides the right conditions for botrytis cinerea, aka “noble rot” to develop. If everything is in their favour, with just the right amount of moisture and heat at the right time, this fungus will work its way into the bunches of grapes, piercing the skin, concentrating the acid and sugar in the grapes, as well as lending its own distinctive spicy, marmalade aromas. Yquem’s team will pass through the vines up to six times, picking individual bunches and berries that are ready. Yields are miniscule, with approximately just one glass of wine made by each vine.  Once the fruit has made its way into the winery, been pressed, fermented and aged in barrel, with only the best selected for the final blend, the wine must be bottled and labelled – prepared for its début in the world. And this is where Martin and Uldry come in, part of the team who ensures that every bottle that leaves the premises is worthy of the Ch. d’Yquem name.   “We seek perfection,” Martin tells me. She has been working at the estate for two decades, having started out in the vineyards before moving into the winery, having worked with the property’s longtime winemaker Sandrine Garbay on the vinification as well as bottling and labelling, and now under the current Maître de Chai Toni El Khawand. Martin, like Uldry, is local – and wine is the region’s trade. Her parents worked amongst the vines, so she followed in their footsteps. But she didn’t love it, she found the yearly cycle repetitive – doing the same thing year in, year out – and asked to move. “This job, it changes every day,” she tells me, of her role in the winery. “I see different people every day; my work changes every day.” Watching the team work is remarkable. While much is mechanised today, everything is checked by a human member of the team. Martin takes a bottle off the line to check a label, whips out a tape measure and tuts before carefully peeling the back label off and reapplying it one millimetre further up the bottle. I watch one of their colleagues lining up a ruler against a double-magnum (all the large formats are still labelled by hand), re-applying a label five times to ensure it is just right. At another station, a woman delicately rolls each bottle in translucent tissue paper, wrapping each one with the same soft touch, before gently laying each one in a case.  Uldry was set to retire at the end of last year, after 23 years at Ch. d’Yquem. Like Martin, she’s seen much change at the estate, with its evolution under LVMH (Louis Vuitton Moët Hennessy), who have invested greatly since they purchased the property in 1999. She recalls how they used to wash the bottles by hand, and the machinery was much clunkier – whereas now it is a very slick operation, with standards higher than ever before.  There was a period when the château did a lot of reconditioning – old vintages would be sent back to them to be checked, authenticated, topped up and re-corked, as well as possibly re-labelled, before being sent back to a merchant or collector. As such, both Martin and Uldry have seen some extraordinarily old bottles, and – luckily for them – had the chance to taste some of them. Martin tasted 1921, while Uldry’s experience stretches back to the 1904 vintage – wines that they struggle to find words to describe. I recall Sandrine Garbay telling me about a bottle from the 19th century that was in a cellar in Spain, but was accidentally broken, and the sommelier team urgently called the château, cradling the bottle as they drove up to Bordeaux, desperate to save the precious wine.  “It's a source of pride that these bottles go all over the world,” Uldry says, when I ask about the ultimate destination of the wine that passes through their hands. They’re well aware of the value of the wine they’re handling, the impact of any breakage, and how crucial their role is. It is, after all, the final step for these bottles before they leave the estate, heading out into the world as ambassadors for the Yquem legacy. And many of the bottles, if not most, of the 2021 vintage (which has just been released) will outlive those that made it. Last year, the great and the good gathered at the ancestral home of the legendary Gordon family (of William Grant & Sons). A hearty dram was poured for the world’s foremost drinks authorities and they were asked to name the liquid within. So far, so normal in the Scotch whisky world. What happened next is quite unusual. Not one of the experts – with decades of experience and dozens of book credits to their name – could so much as hazard a guess.   The answer to the seemingly simple but dastardly question dumfounded them all. The as-yet-unidentified liquid was a single grain Scotch whisky that had slumbered in a lone Sherry butt for 53 years. Now almost jet-black in colour, the single grain had taken on incredible, rich notes of dried fruits, roasted coffee, and muscovado toffee – and it was indistinguishable from a greatly aged single malt.   The Cask Trials, which is the name given to this highly unusual liquid that left some of the finest palates awestruck and not-so-secretly hoping for a bottle in their gift bag, is just one of the panoply of independently bottled House of Hazelwood releases from the Gordon family’s private Scotch whisky archives.   Somewhat surprisingly, you won’t find a single malt among them. These rare whiskies, which have been amassed over the past 100 years by the owners of Glenfiddich and The Balvenie, were released to the public for the first time in 2022 in two, painfully scarce, collections. The Charles Gordon Collection (all priced above £3,000 per bottle and aged for at least 40 years), and the Legacy Collection (priced between £950 and £2,000 a bottle) are all well-aged blended Scotch, blended grain and blended malt whiskies that have been matured in the most novel ways.   “Bringing old, expensive and unusual blended whiskies to the market is slightly counterintuitive,” House of Hazelwood Director Jonathan Gibson – who was instrumental in creating the range – candidly tells me. “It's not overly common within the industry.”  It’s also not overly common within the industry to bottle liquids of this age and provenance with playful names such as "Blended at Birth", "Sunshine on Speyside" and "The Old Confectioner’s", in understated packaging at these price points.  The liquids are undeniably scarce (once they’re gone, there really is no more) and old (few are under 40 years of age, and the oldest tops 50 years), but they are undeniably unusual and at odds with the highly successful formulaic approach others have followed of encasing precious liquids in highly ornate, priceless vessels that weigh more than a small child.    “They're not concept releases,” Gibson explains. “Everything is driven by the whisky. The packaging is quite straightforward. It's a nice bottle and it's classically engraved but we haven’t collaborated with the hottest designer. The idea is really just to give the whisky room, provide a platform, without overshadowing it,” he adds.   “Over the past 10-15 years – and it's no bad thing at all – you can see a lot more old age-statement single malts coming onto the market,” Gibson says, “And typically they're very straightforward in terms of their naming. It's distillery name, plus age statement equals a certain financial value.  “The naming of these releases is slightly playful, but actually if you look at them one by one, they're very straightforward. It's not quite a Ronseal, ‘it does exactly what it says on the tin’ approach, but it's not too far away from that. If you said ‘Blended at Birth’, it could be seen as quite playful but it's also quite descriptive and the same for ‘The First Drop’ and ‘Sunshine on Speyside’,” he explains.   It's clear Gibson, who has been involved in the project since the start, has genuine affection for the whiskies and the stories each one has to tell. He and the team are custodians of historical artefacts that the Gordon family have not parted with for the best part of a century.  “The First Drop”, for example, is named as such because it is the first liquid to run from the stills at the Gordon family’s Girvan grain distillery on Christmas day in 1964. This is the first and last time it can be purchased. “There's a real emotional tie from the family to these whiskies,” Gibson explains. “For the current family members, it's their dad who laid down these whiskies and he's not around anymore.  “I think it's actually quite difficult for the family to let some of these whiskies go, even though there's a begrudging acceptance that they can't drink such quantities and it was time they cut the cord and let these whiskies go out into the world.”  “There's a general principle that we're following where the whisky is ready to go when it's ready,” Gibson explains, “so we're not chasing down a 60-year-old age statement just so that we can put a big 60 on the bottle.”   It has been a pleasant surprise for all those involved to witness the reception the House of Hazelwood whiskies have received from an occasionally prickly and vocal audience.    “Sunshine on Speyside had an amazing response and it's one of the least expensive whiskies within our range,” Gibson says delightedly.   “It was selected because of its character and its flavour, and named because it has this amazing mango/ pineapple popsicle fruit character that transports you to sunshine and the Caribbean. It's one of those ones where everyone instantly agreed that it had to go into the first collection.   “I thought that everyone would be drawn to the oldest whisky at tastings but actually, this whisky captured the imagination of a lot of the writers and the trade.”   It’s hard to emphasise quite how unusual these whiskies are, as most releases – old or new – are described in hyperbolic terms.   “Blended at Birth”, which was released as part of the first collection, is a blend of malt and grain whisky that was married and matured as new-make spirit. Today, it is against the Scotch Whisky Regulations’ technical file to produce a whisky in this way, as you now have to age the malt and grain whisky components for a minimum of three years separately before blending them, so any liquids of this ilk on the market are painfully scarce.   “Unusual” and “esoteric” aren’t always necessarily loaded with positive connotations – you might take a sip of said liquid, politely smile and then return to something slightly less unusual and more palatable – but these whiskies have incredible balance and depth of flavour, in part because they are blends and not single malt whiskies.    “These old grains in particular are just unbelievable in terms of the flavour,” Gibson says with unfettered joy. “At a younger age, grain whisky is quite neutral in character but once you're past 30 years, if it's aged well, grain whisky has a luscious, delicious quality which adds so much to the final profile of the Scotch.    “The variation in style is enormous,” he continues. “I thought I understood old grain whisky but on exploring the inventory further you see these amazing grains that you didn't really know you could get.”   These whiskies wouldn’t have existed if it wasn’t for the foresight of the Gordon family  – and two brothers, in particular, who changed the company’s stars during the mid-20th century. The young Charles and Sandy Gordon brought much-needed vim and vigour to what could be a bit of a staid industry in the late 1950s. The pair famously refused to kowtow to demands from their grain whisky supplier – instead pulling the contract and setting up their own grain distillery, Girvan, in the 1960s. Charles – or Charlie as he was known – even forwent the comfort of his own home and instead lived in a caravan on-site during the build, riding a bicycle to stealthily check on the workers’ progress. His unconventional methods clearly paid off as the sizeable distillery (which still stands today) was built in a record nine-month period.  During their tenure, the duo also interrogated every aspect of whisky-making from distillation to maturation, resulting in the bold decision to employ an on-site coppersmith and cooper – which are still in situ at many of the William Grant distilleries today – to give the family more control. They were a formidable pair and the business arguably wouldn’t have survived some of the challenging periods in Scotch whisky’s history had it not been for their fortitude.     “There's something about family ownership that means you have a bit more luxury to maybe indulge some of your creative whims,” Gibson says with a wry smile. “This independence enabled them to explore ideas that might have been hard for others to justify to their board of shareholders.”  When other producers would have been forced to make very difficult decisions in order to survive those darker years, the larger, independent William Grant would have been slightly more insulated. Out of curiosity alone, they would have been able to hold on to barrels of maturing liquid and see how they developed over time.  These are the barrels that the House of Hazelwood team – and by extension us – now have access to. Each one has an incredible story – and an even better depth of flavour.
