Unlike many wine-lovers, I came across Occidental before Kistler. I worked for a company that imported some of its early vintages – and they were like nothing I’d ever tasted. These translucent Pinot Noirs glimmered, but their pastel-pale shade was nothing but a nudge and wink at the Burgundies that inspired them. Aromatics leapt from the glass – floral and febrile, but it was the vivid, intense, crystalline purity of the palate that I found so beguiling. Seeing where these wines are made – on the brink of the Pacific, where ocean breezes lash at the vines, and thick fog grasps the dramatic, undulating landscape – only made them all the more enchanting. Even today, 18 years after Steve Kistler first put down vines here, the region is sparsely planted – with Occidental one of a handful of pioneers of the outer reaches of the Sonoma Coast. The area was long deemed too cold to ripen fruit, with dairy the main industry – and fields of grazing cattle and sheep are still interspersed with plots of vines. Occidental’s vineyards – now 85 acres in total – now neighbour those of Platt, Littorai and Joseph Phelps’s Quarter Moon site, sitting at 500 feet above sea level – a modest altitude when you consider some of Napa’s mountain districts have parcels above 2,000 feet. But it’s their proximity to the ocean (which is just five miles away) that makes the climate here so cool – and damp. Leaf-pulling and spraying are key to managing disease pressure – unfortunately making organic farming almost impossible. “We want the purity of fruit to shine,” Catherine (Cate) Kistler says. She joined her father, Steve, six years ago, working as his Assistant Winemaker – just one element that makes the venture a true family business. Not in the way that Walmart or Ford are a family business, but in the hand-to-mouth, everyone-mucks-in, this-is-both-their-livelihood-and-legacy kind of way. It’s a “tight little universe” where they work, live and farm, Cate explains. This is one reason that Steve stepped away from the iconic winery that he’d created in 1978 – Kistler had shifted and grown, becoming something larger than he’d ever anticipated, or necessarily wanted.  Kistler had humble beginnings – with Steve making the wines in what was essentially a wooden shack, and living upstairs. That building – up in the Mayacamas – was consumed by the fires in 2020, and today Kistler works with around 300 acres (including their own vines and those farmed by growers for them). The investment of Bill Price (a man whose first major move in the wine industry was buying, and later selling, Beringer) has added further gloss to a winery that has become one of California’s cult names. If that makes it sound like there’s been wholesale change, that’s far from the truth – a clear succession plan has ensured only the gentlest of evolutions at Kistler, and ensured the producer maintains its position at the top. Jason Kesner – who describes himself as a “vine and yeast shepherd” – is the man at the helm today. He joined the team in 2008 (aged 40), working alongside Steve for close to a decade before taking the reins.  Although born on the East Coast, Kesner grew up around wine. He moved out to California aged eight, where his mother had taken a job as Head Microbiologist at Robert Mondavi, and his soon-to-be stepfather worked as VP of Vineyard Operations – the smells and sounds of a working winery firmly familiar. Despite his early initiation to the industry, he studied cultural anthropology and left both the area and industry. He was eventually lured back, working first for Francis Ford Coppola (the man behind Inglenook’s revival), but in a non-wine role – managing his special projects. Via Coppola’s poker games, Kesner connected with Pat Kuleto and ended up planting vineyards for him, before finding himself at Hudson (his “graduate school for Chardonnay production”). This prestigious name features on bottles from the likes of Aubert, Kongsgaard, Cakebread, Failla and Ramey – and Kesner got to work with all of them, growing top-tier fruit for 34 clients, including Steve Kistler. And Steve was different. He was, Kesner says, “very, very focused”, “hyper-intelligent, borderline genius” and – along with his business partner, the late Mark Bixler – thought about things on a different level. When the duo started Kistler in the 1970s, working with a single clone and single sites, no one else was doing it – with his unparalleled energy and intent, Steve created something profound. Although Kesner had already worked closely with Steve at Hudson, it was only when he arrived at Kistler in 2008 that he realised how differently Steve operated. “I had jumped into a different timeline and a different pace,” Kesner tells me. “Steve and I had conversations that, quite literally, spanned years.” These conversations would be picked up each vintage, just a handful of sentences on a topic expressed until the next season. For Kesner, this long-term vision was what set Kistler apart: “It’s not about the people who are doing it at the moment. It’s about everything that’s come before and it’s about everything that will come after.” The Kistler evolution has been slow, but it has happened – past their phase of “embracing the cocaine ’90s” (“If you weren’t, you weren’t paying attention,” Kesner says), with a shift toward earlier picking, native ferments and reduction in new oak (from 50% down to around 38% across the range today) – but without sacrificing the seductive, silken style that defines their Chardonnay. “Our job is to polish the jewel,” Kesner says. “The diamond doesn’t need to be re-cut.” The vines are also gradually gaining in age (currently averaging a spritely 35 years), which is only improving the wines further. Kesner is continuing Steve’s work and the philosophy remains true to the original concept. “The best and highest use of a given site is when you're guiding it, not driving it,” he says, pointing to Mother Nature (rather than Bill Price) as the ultimate boss. He loathes the title “winemaker” – fully aware that it’s an entire team behind Kistler. “There are 56 people who are dedicated to the production of these wines. They’re out there pruning in January and then they’re going to be out there picking for this year in October. And it’s because of that really powerful group of people that we’re able to do what we do.” Meanwhile, out on the coast, Steve is continuing his own quest for terroir. Occidental, Cate tells me, is all about exploring “what this ridge means”. The yields at Occidental, overlooking the Pacific, are tiny, maxing out at around two tons/acre. The work is painstaking, with careful canopy management and spraying to avoid mildews, and steep slopes that need to be hand-hoed to manage the weeds. And, as at Kistler, the Pinot Noirs here are all made identically – so it is the site, rather than hand of the maker, that shines through. Be that though it may, it takes exceptional talent to make wines like this. “[Steve] is yet again 30 years ahead of everybody in California,” Kesner says. “It might take the American palate a while to catch up with them, but I firmly believe those will be recognised as some of the best Pinot Noirs in the world. Hands down.” Steve’s an elusive character – and seems happiest tucked away in his remote corner of the Sonoma Coast, away from the limelight. “He’s not a man of many words,” Kesner says, although suggests that working with Cate has drawn him out of his shell a little. Cate talks about him unsurprisingly lovingly, but doesn’t shy away from admitting there are challenges to the “weird and wonderful world” of family business. Harvard-educated, she’s quick-witted and sharp, and has clearly inherited her father’s passion for wine. Not only is he clearly deeply embedded in everything Occidental, but his interest goes beyond vine-growing, with what I suspect is an enviable collection of his own, from the alluring line-ups of Grand Cru Burgundy that I’ve glimpsed on Cate’s Instagram. It takes something rather extraordinary to be willing to give up your name, to start from scratch, all over again, with a new winery and new vineyards. But there’s a reason that his longtime vineyard manager (Ruben Molinar) and cellar master (Raymundo Abarca) left Kistler with Steve in 2017; and it’s a tribute to the man. Now Molinar and Abarca’s children are working alongside Steve’s – and the family is growing. But Cate and Steve don’t want to create Kistler 2.0. They’re developing another ranch, but they don’t want the project to become so big that they’re no longer doing most of the work themselves (“We’ve seen that movie,” Cate jests). The first vintage of Occidental was only 2011, but the wines are already making their mark. Steve’s legacy at Kistler lives on, safely being shepherded by Kesner and his team, but it’s also being re-born at Occidental, and set to be carried forward by Cate. “Wine is my dad’s world,” Cate tells me. In pursuit of Sonoma’s true identity: Kistler and Occidental

Driving through Napa and Sonoma, the land still bears the scars of 2020. The wildfires that raged through the region have left a long-lasting mark, whether it’s lengthy reconstruction efforts or the stark, charred tree trunks that cover the mountains. But it’s more than that. To an outsider, the fires feel intangible, terrifying yet somehow conceptual. Talking to those that lived through them, however, makes you instantly realise quite how petrifying that season was. The trauma of those flames is still smouldering away.  In 2017, fires hit Northern California on 8th October, however most producers had already harvested. Indeed, the fire even crossed the Kistler property, but their vines helped act as a firebreak. Two years later the Kincade fire swept through Sonoma County at the end of October. But in 2020, the first fires arrived earlier. The LNU Lightning Complex started with what is known as the Hennessey fire on 17th August. Sparked by lightning after thunderstorms, the complex was a weave of 250 different fires that collectively raged through almost 150,000 hectares of the region. The damage was enormous: 1,491 buildings were destroyed and six people lost their lives. While the fire did diminish in size, it wasn’t entirely extinguished until 2nd October, almost a month and a half after it started.  Before the Lightning Complex had fully subsided, the Glass Fire attacked. The blaze started on 27th September, east of St Helena near the Silverado Trail, spreading north to Calistoga and then south and west, towards Santa Rosa. It burned until 20th October, encompassing over 27,000 hectares and taking over 1,500 buildings with it, including numerous wineries. It cut through Eisele Vineyard, across 90 acres of hillside and forcing them to rip up 1,000 vines. Fortunately they’d already picked all their fruit (finishing their harvest three days before the fire broke out, on 24th September). And this was all in the midst of Covid-19.  Wildfires aren’t new in Northern California, but they’re certainly more prevalent than ever before. Indeed, as Cory Empting – Director of Winegrowing at Promontory, Harlan and Bond – tells me, the region’s indigenous people, the Wappo, used to describe autumn as “smoky mountains”.  Paul Hobbs – who has been making wine in “the Valley” (as the locals would say) since the late 1970s – remembers a fire in the 1980s that burned its way along the Silverado Trail. “All it took was a gust of wind,” he says – and one flame turned into something uncontrollable in the blink of an eye. He remembers climbing up on a roof to see the sobering effects of the fire.  Perhaps partly due to this early exposure, fires have always been at the forefront of his mind when picking a site – avoiding rugged, dry areas like Diamond Mountain or Calistoga. And he is exacting with forest management of the sites he works – even on our wander around his Goldrock Estate vineyard, he notices some saplings that are troubling him, and calls over his vineyard manager to take a look, conscious to reduce the risk as much as possible. And he’s deservedly cautious. The 2017 vintage was his first working with Cleary Estate out in Freestone-Occidental, and he paid almost $2 million for fruit that he couldn’t use. The fire itself is one challenge, however vines are natural firebreaks so don’t tend to suffer much direct damage (although the heat from a blaze can sometimes scorch vines). The real threat, however, is in the air – smoke. But the science of smoke taint is complex, and poorly understood. Producers can send samples to laboratories to be tested for the compounds responsible for the taint (guaiacol and 4-methylguaiacol) but the exact level of perception isn’t known. These compounds also naturally occur in some varieties, eg Syrah, and come from oak barrels (in particular the toasting process).  Of course the impact of smoke is dependent on proximity to the fire, the intensity of the smoke, elevation and the wind. Hobbs explained how in 2020 much of the smoke from the Glass Fire stayed north for several days, but then the wind shifted and sent it south to the Bay Area. As smoke travels, and ages, the volatile compounds also degrade, so there is also a significant difference between the impact of “fresh” smoke, versus what Hobbs describes as “atmospheric” smoke. The latter may look bad, but it’s unlikely to hold significant taint, whereas if you’ve got fresh smoke, it’s “game over”.   Lots of producers do micro-ferments to look for smoke taint, testing to see if it’s worth the expense of picking the fruit and making the wine – however that’s also not a sure-fire way to know if you have smoke taint. The nature of these compounds means that they can lurk, undetectable in a wine, and emerge in bottle as hydrolysis occurs. “That’s why it’s so insidious,” Hobbs says.  If you’ve got smoke-tainted fruit, the options are limited. The compounds are concentrated in the skins, so the aim is generally to minimise skin contact. Indeed, some producers made rosé in 2020, having picked earlier, with higher acidity than normal. Otherwise you can use reverse osmosis or spinning cone (both expensive processes that are used for de-alcoholisation), or carbon fining – or a combination of all of the above – to try and strip out the smoky flavour. The result, as Mark De Vere MW at Robert Mondavi said of trials they’d done, it generally didn’t work, but if it did, “It took so much else out.” (Robert Mondavi ended up making almost no 2020 wine.)  *  Read anything about 2020 and there is a cacophony of opinion. “Everyone handled the vintage differently,” Cate Kistler of Occidental told me. They picked on 18th August, not in response to the fire, but because that was when the first fruit was ripe. They didn’t do any micro-ferments or send samples to labs (“We’re not data-crunching people,” Kistler says). The cost of picking was, for them, “a drop in the bucket” in comparison to farming the vineyards the rest of the year, so they tried to do what they could.  “It was going to be either Occidental, or nothing,” she said with a shrug. They took their time, committing to making every decision as if it was a normal year, finishing on 6th September just as the Labor Day heatwave hit. They didn’t use everything they picked, but they made all five of their single-vineyard wines – and the 2020s we tasted are glorious.   Some, like Colgin, didn’t make any wine at all, while many producers made around 40% less (such as Williams Selyem and Peter Michael). Many of the 2020s that will be released were picked before the fires struck. Cathy Corison had all her fruit safely in the winery more than two weeks before the Glass Fire hit, but the challenge was to keep the smoke out of the winery. She bought industrial grade air filters to shield her ferments. “They’re beautiful,” she says with a quietly proud smile.  At Dalla Valle, Maya Dalla Valle doesn’t pretend that it was an easy year, but she’s pleased with the wines they made (all with fruit picked before the Glass Fire). As ever, these are wines that speak of their year – which wasn’t just the fires, but a hot, dry year that (along with a block that was being re-grafted) cut their crop to a mere 2,700 cases in total. At Dominus, they did micro-ferments after the Lightning complex, and had picked their last row of fruit on the morning the Glass Fire broke out.  Steve Matthiasson – the leading viticulturalist who also has his eponymous label with his wife Jill – told me how it was set to be “an epic season” before the fires hit. He highlighted how the smoke meant there was less UV light reaching the grapes, and that meant the fruit wasn’t as phenolically ripe. They pick early, so had started harvest 10 days before the Glass Fire broke out. The Cabernet Sauvignon in their Phoenix vineyard was still out, but they managed to pick it the morning after the fire broke out, before the smoke was able to take effect.  Most who picked early are in agreement that the hot, dry conditions were in their favour. Promontory saw only eight inches of rain, versus the 30 of a normal year. But that hydric stress helped them – it meant the crop was small and the vines shifted to ripening the fruit earlier, so even though they picked on 22nd August they had no pyrazines. As Will Harlan says, in some ways, “The stars aligned”.  The 2017 vintage might have prompted people to start thinking about climate change, but 2020 was a real wake-up call for the region. It prompted Martin Reyes MW to try and create a community around climate action. Eventually, working alongside Anna Brittain, he founded Napa RISE (standing for Resilience Innovation Sustainability Empowerment), a climate and wine symposium that first took place in 2022 (with the 2023 symposium currently underway). It’s early days, but they’re “trying to build into the DNA [of Napa RISE] this notion of action”. He’s keen to avoid a conference focused on discussing concepts, but an industry convention that drives change.  One part of that conversation is inevitably fire – and a session last week focused on forestry management. “The relationship with fire we have is complicated – but it can be a healthy relationship,” Reyes tells me.   Controlled burning has long been a part of life for indigenous peoples – both in North America and Australia, where wildfires have now become a threat. In the US, controlled burning was officially banned in 1911 when the Weeks Act was introduced, but California is gradually realising the need for its reintroduction.  “Agroforestry was happening before conservation took it off the table,” Empting (of Domain W. Harlan) tells me. He talks about how when the previously evicted Miwok people were allowed to return to Yosemite, they were horrified by what they saw – where “conservation” had destroyed the ecosystems. For native peoples, seasonal work like controlled burns was a way of life – seen as their responsibility to the land. But it was a responsibility that colonialism robbed from them, and didn’t take on.  At the Pepperwood Preserve, native peoples do controlled burns. Empting visited to explore the practice and see if it’s something they could take up as part of their stewardship of the land. The challenge today is the paperwork – and politics. Permits are difficult to obtain, the fire department is reluctant and has to be involved, and then there are the neighbours to contend with.  Hobbs highlights that it’s not just that there aren’t enough controlled burns, but that manmade structures have taken over swathes of land – and they burn hotter, leading fires to rage in less predictable ways.  Of course, as with 2017, the 2020s are already being marred by rumour and reputation of a smoke-tainted year. The reality is so much more complex – and, although I haven’t tasted enough to make pronouncements on the vintage, there are some brilliant wines. Of course you’ll need to choose carefully, but for top producers there is nothing to be gained by releasing wine that is anything less than flawless.  While the fires have left scars, the land’s capacity for renewal is remarkable – with vibrant vegetation flourishing in amongst the scorched trees. The 2020 vintage wasn’t the first to see such challenges and it won’t be the last. The soils can recover, and so can the people, but a sustainable way to manage these threats is essential to long-term survival. Read more about California or browse all California listings

The way the wind blows

Think of the Golden State and you imagine sunshine, orange trees and top-tier surf. But this past week, I’ve seen crazy winds, dramatic (and welcome) rainstorms, below-zero temperatures and more snow than anyone in Napa has seen for 50 years. In a similar way, it’s all too easy to shoehorn the region’s wines. Big Cabernet. Buttery Chardonnay. Those, like the sunshine and surf, are the clichés. But there’s much more than cliché to California, an area as large as many countries, and the wines made here. Over 1,000 miles from north to south, with vineyards sitting at altitudes of 50 to over 2,000 feet, cooling influences from the Pacific and San Pablo Bay, complex ancient soils (up to 140 million years old)… California is far from simple. And you’ll find everything from Arneis to Pinot, Grüner Veltliner to Schioppettino. This week, we’ve been on the road, exploring Napa and Sonoma, talking to just a handful of the producers that have made California such a special place for wine-lovers. The scale of this landscape is grander, with a sense of space to breathe, the parcels of vines tucked in amongst hills and mountains, with the expanse of coastline just a short drive away. You can see why it was – and is – a land of promise.
 While Napa and Sonoma are firmly established as fine wine regions today, their history is comparatively short. George Yount (who gives his name to Yountville) is thought to be the first person to plant grapes for wine in Napa in the 19th century, while Charles Krug was the valley’s first commercial winery, founded in 1861 – closely followed by names such as Schramsberg, Beringer and Inglenook. By 1889 there were over 140 wineries in the area. But phylloxera struck, then Prohibition, and the thriving industry’s expansion was sharply curbed. Producers that survived that difficult period found loopholes in the law, such as unofficial home-winemaking kits and sacramental wine. After Prohibition’s repeal in 1933, it took time for the industry to find its feet. The Mondavi family – who bought Charles Krug – was integral to its development, but the focus wasn’t immediately on fine wine. Figures such as Georges de Latour, Louis M. Martini and André Tschelischeff started changing the story, but it was arguably Robert Mondavi – who struck out on his own to found the eponymous winery – who led Napa into a new era, championing it as a region that could compete with the Old World. Of course, the now legendary 1976 Judgement of Paris was the turning point. When California came out on top in Steven Spurrier’s blind tasting, the world took note. Soon the cult of Napa Cabernet was born, and as Parker’s scores swayed palates, prices soared. 
But it’s unfair to think of that as the region’s story – for there is much more to uncover beyond the sheen of those 100-pointers. While of course some producers come with the polish you might associate with Napa, almost every winery we’ve visited has been fast to focus on the vineyard, whisking us out to walk or drive through the vines. As an agricultural state (grapes – both wine and table – are only the second biggest crop here, following the dairy industry, and with almonds only just behind), farming is at the heart of its culture.
 And it’s ever more relevant, with the region at the forefront of climate change – as this week’s extraordinary weather conditions show. Drought is an ongoing challenge (although recent rains have replenished groundwater), and wildfires have stolen headlines – especially in the 2017 and 2020 vintages (expect much more from us on this soon) – ravaging vast swathes of land, the flames and the associated smoke taking both lives and livelihoods. Despite these challenges, there’s such excitement here – with an electric vitality to the industry. Land prices in Napa are enormous – over half a million dollars per acre for the best sites, and planting any additional land is almost impossible. But that isn’t stopping its evolution, with shifting farming, winemaking, varieties and styles as producers look to redefine modern Napa. Head west towards the Sonoma Coast, where the ocean breezes and fog are bone-chilling, and new frontiers are being forged. The skies here are moody, thick fog cloaking the view of this exposed area, but fields of sheep and cows are being replaced with vineyards as people push limits to create restrained styles, especially of Pinot and Chardonnay. 
We can’t thank producers who have swung open their doors to us enough. We’ve already had so many fascinating conversations about the trends and challenges in the region, about what people are doing in the vineyard and winery and why, and tasted some remarkable wines. Hundreds of thousands of people headed west in the 19th century, drawn to this corner of the land of opportunity. Many didn’t find their fortune in the Gold Rush, but this is still a place that holds such promise.  Reinvention and revolution is the Californian way, powered by a uniquely American entrepreneurship. Forget the scramble for treasure, today the bold and the brave are creating their own destiny – and it’s filled with hope.

For more than two decades, Donum has been quietly crafting single-site, single-clone and sometimes single-barrel wines. With a new estate vineyard to their name, Rachael Ryan – Senior Buyer at our US arm, Vinfolio – sat down with winemaker Dan Fishman to find out more about the ambitious estate  Like most of the New World, California eschews a hierarchy of vineyards. Yet in the absence of Grands Crus and First Growths, some vineyards are just acknowledged as being a notch above the rest. Ask any winemaker for a wish list of vineyards, and a handful of familiar names is repeated. One of these is the Savoy Vineyard.  Nestled at the north end of the Anderson Valley, Savoy was first planted in 1991 and quickly became a source of Pinot Noir for some of the most respected wineries in Northern California, including Littorai, Williams Selyem, Radio-Coteau and Peay, with many more on the waiting list. Last year, however, it was acquired by Donum, a winery based in Carneros with a reputation for producing small lot Chardonnay and Pinot Noir, sold exclusively to private collectors and therefore rarely seen on the market.  Since it was created in 2001, Donum had slowly expanded its reach beyond Carneros, with vineyards in the Russian River and Anderson Valleys, as well as the Sonoma Coast. With the acquisition of Savoy, however, their already envious collection of vineyards took a very notable – and sizable – jump. The gain of this prestigious vineyard marks a shift for Donum, who will now produce wine from estate fruit only: 130 acres at their estate in Carneros, 16 acres at the Winside Vineyard in the Russian River Valley, 20 acres at the newly planted Bodega Vineyard on the Sonoma Coast, and the 42 planted acres at Savoy Vineyard in the Anderson Valley.   Already well-known for their world-class art collection (with over 50 works by the likes of Keith Haring, Yayoi Kusama and Ai Weiwei), what many visitors may not realise is that Donum now has a solid foothold in each of the premium Pinot Noir and Chardonnay winegrowing regions in Northern California.   In some ways, the vineyards owned by Donum are innately similar, perhaps most closely linked the marine layer. This dense fog rolls in from the Pacific Ocean most afternoons during the growing season and is a key characteristic of each of these vineyard sites. The mechanics of this cooling marine layer are somewhat straightforward. As temperatures climb in inland California, the hot air rises, creating a vacuum into which the denser, colder air sitting over the Pacific Ocean rushes. On a typical summer day, coastal areas are fully clouded over by late afternoon, and the fog continues to creep further inland, searching for gaps and valleys in the coastal ranges to extend its reach. This cold, moist air both lowers sunlight hours and keeps temperatures low. In other words, this coastal phenomenon is an extremely useful aide in the production of lively wines that retain a fresh edge.  Aside from cooling fog influence, however, the vineyards Donum farms are topographically quite different. The estate property in Carneros, with its gently rolling hills and proximity to the bay, straddles the southern portion of both Sonoma and Napa counties (though Donum’s property is firmly situated on the Sonoma side), with consistent winds blowing from the southeast over the San Pablo Bay giving the region a wide diurnal shift and the resulting wines a sense of energetic tension. The Anderson Valley, on the other hand, is a narrow swathe cut through dense, old redwood forest, and it's difficult not to mentally connect the rugged hills that line the valley on both sides with a similar evergreen, earthy core in the wines. The Russian River Valley is a warmer microclimate, further removed from the cooling influence of the ocean or bay, with loamy soils producing a more concentrated style of wine with opulent fresh fruit.  But for Dan Fishman (Vice President of Winemaking and Vineyards) perhaps the most unifying characteristic across each site is a hyper-focus on farming, which he believes is the best – and perhaps the only – way to showcase these unique terroirs. When he joined Donum in 2007 as a cellar intern, the farming was conventional, with routine application of herbicides and synthetic fertiliser. In recent years, however, he has spearheaded a pivot towards organic farming.   Notable features of this approach include an on-site composting program, where manure from local dairy farms is added to pomace from the winery and canes from pruning. Other eco-friendly initiatives include an integrated pest management system, extensive cover cropping (Fishman estimates Donum currently uses 20 different cover crop blends comprised of over 40 different plants), as well as animals brought into the rows for winter grazing. All these systems have improved the soil structure, “bringing more back to the soil than we’re taking from it”, he explains.  A peek into the rows at the Carneros estate reveals this shift in viticultural philosophy, with verdant cover crops and bees hovering. Tucked between the sculptures that dot the property are vines that are farmed meticulously. While the art is spectacular and very difficult to ignore, the attention to detail in the vineyards is perhaps even more impressive. Donum is now one of the first wineries in Sonoma County to achieve Regenerative Organic Certified (ROC) status for all its estate vineyards, and they’ve also been certified organic from the California Certified Organic Farming Association (CCOF) since the summer of 2022. The ROC status, however, is one that Fishman is particularly proud of, as it encompasses not just soil health and land management, but also animal welfare and the working conditions of the employees.    When asked if he has seen a difference in the behaviour of the vines, and in the quality of the fruit, since undertaking a rigorous approach to organic viticulture, Fishman’s answer is an emphatic yes. He points to the 2023 growing season as a prime example. In a year marked by record-breaking rainfall that extended into early spring, the threat of mildew was abnormally high. “Our conventional neighbors were spraying like crazy and still had mildew,” Fishman says, “but we were obviously using organic methods and applying them less frequently, and we had way less mildew. I think the vines’ natural resiliency was coming out.”   In line with a larger overall trend in Northern California, Fishman says he also has been trying to fine-tune the weight and concentration of the Chardonnay and Pinot Noir produced at each vineyard. If Burgundy’s biggest challenge historically has been to achieve even ripeness vintage to vintage, California’s problem cultivating Pinot Noir and Chardonnay been quite the opposite: how to tame abundant sunshine and control vigour resulting from warm days and fertile soils. While the fog assists with this task, one unexpected benefit of the winery’s intensive focus on farming, Fishman explains, is that the vines are more in balance. “It’s on the subtle side,” he says, “but our wine chemistry is looking better too – higher acidity and more flavour at lower sugars.” Opulence has given way to restraint and nuance.   The resulting range of wines at Donum is an impressive display of small-lot vinification, broken down not just by appellation or vineyard, but also often by individual blocks. In 2021, the winery produced six distinct Chardonnays and 17 Pinot Noirs in total from Carneros, the Russian River Valley and the Anderson Valley. With the development of their newest vineyard on the Sonoma Coast, Donum’s already complex patchwork quilt of wines is about to get even bigger.   With a gentle hand in both the vineyard and winery, Fishman hopes to highlight the most minute of variations in each wine, allowing the innate characteristics of each site to shine through. “We have a really intense focus on vineyard flavour first,” he explains.    “We’re not trying to force a house style, just let the vineyard or block do the talking,” Fishman continues, “We’re trying to make the best Pinot Noir and Chardonnay in California, wherever that comes from.” With access to such an extensive assortment of prime locations, now including the illustrious Savoy Vineyard as a feather in its proverbial cap, to say that the future at Donum is exciting is an understatement indeed. While many may think of California Pinot Noir and Chardonnay as one group of wines, a monolith with little variation in style, Fishman and his team at Donum hope to change that mindset, one vineyard at a time.  The Donum wines have historically been available only to those on their mailing list, but we are now working directly with the estate: browse all current Donum listings.

Discovering Donum’s single-site wines

First place: Donum

“I was broken-hearted,” says Tim Mondavi, his eyes glistening at the memory of how his family was forced out of their business, Robert Mondavi Winery, 20 years ago. Wine runs through the Mondavi family’s veins. Cesare Mondavi – Tim’s grandfather – made his first vintage in 1919, and the family purchased Charles Krug Winery in 1943, before Robert broke away to establish Robert Mondavi Winery in 1966. Luckily, when Constellation took over the business, the Mondavis left with “a bag of money” – something, Tim says smiling, that is better than being heartbroken and broke. He went in search of “a new love”, and so he built Continuum. The concept was simple: to “shoot for the stars”, Tim tells me, and craft a wine that would rival Bordeaux’s First Growths – as well as continue his family’s legacy in Napa. Having seen how their family business had grown, shifted and ultimately fallen into corporate hands, he and his sister Marcia wanted to keep things simple. The first few vintages were made with fruit sourced from Robert Mondavi, largely To Kalon – vineyards that Mondavi had worked for 30 years and knew inside-out. But he knew that site was everything, and thinking of Burgundy’s best wines, he looked to the hills – keen to find his own slice of “Grand Cru” terroir. So he “kicked a lot of dirt” – and in 2008, he found something.  Up-slope from Dalla Valle, above the fog line and neighbouring Colgin, a marine biologist called Leighton Taylor had planted vines on Pritchard Hill in the 1990s. He was a wine-lover and saw the roots he put down in these rocky, volcanic soils as his retirement plan. His children didn’t share his passion, and he decided to sell: enter the Mondavis. Tim Mondavi instantly realised the potential of the site and bought the 173-acre property. Southwest-facing, with sparse top-soil and the intense sunlight that this altitude offers, he named it Sage Mountain Vineyard, after the abundant wild sage found across the property. The area had been conventionally farmed and needed work, and Mondavi brought two of his old team onto the project. Together they worked to realise the potential of these rocky 70 acres of vines, regrafting, replanting and refining the farming – drawing on organic and biodynamic practices. Gradually, they started using fruit from the site for Continuum, and from the 2012 vintage the project was exclusively estate-grown, all coming from Sage Mountain Vineyard. In 2013, they completed work on a winery on-site – meaning everything was done in-house by their own team – a first for the family. For Tim, it was a big moment. The vintage happened to coincide with his 40th harvest, as well as the 100th anniversary of his father Robert’s birth – and the label bears a dove in tribute to him, flying over the vines.  Robert was not just the patriarch of the family but of the entire valley. He passed away in 2008, just a month after Tim had shown him Sage Mountain Vineyard. He was a force of nature, who not only built the family empire but put Napa on the map, fighting relentlessly for the region on the world stage. It’s hard to imagine that he was an easy man to have as a father. “There was no such thing as too much,” says Tim. “But there was no such thing as enough.”  Robert was, Tim tells me, “go, go, go” – and it’s clear Tim wants something different for his family. With Continuum, he wanted a project that could provide a balanced life – smaller than the smallest project at Robert Mondavi. Tim’s children haven’t run away from their fate or the family business. They’ve all worked at Continuum at one point or another: sons Carlo and Dante have gone on to establish Raen, their own Sonoma Coast Pinot Noir project in 2013, while Chiara has joined her father and is firmly in situ as winemaker at Continuum.  The Mondavis might be Napa royalty, but they’re also farmers – and they’re more aware of the challenges that climate change brings than anyone else. “Mother Nature has so many ways to remind us we haven’t been taking good care of her,” Tim says ruefully. The wildfires of 2017 brought that closer to home than they’d have liked. The Continuum team was two-thirds of the way through the harvest when Tim saw the glow on the horizon from his house. He instantly called to cancel the harvest, and ensure everyone stayed far away from the winery and vineyards – but his vineyard manager ignored him and drove straight up the estate, to check that none of the crew were already on-site ahead of their early pick. Luckily the team was all fine – but those fires filled Tim with fear.  They didn’t make a 2020 vintage, so the latest release – the 2021 – is the first for two years. They’ve been gradually increasing the proportion of Cabernet Franc in the blend, and the 2021 has the highest percentage to date (representing over a third of the blend). It is, Tim says, “our finest effort” – something he attributes not just to the year’s conditions, but over a decade spent getting to know each of Sage Mountain Vineyard’s 44 blocks. “To be truly great, you have to understand the site,” he says. The wine is elegant and pure, with a saline, earthy minerality that is an imprint of the property – something that runs through every vintage. Tim’s been making wine for 50 years now, but knows that he’s in a generational business. Continuum might be his new love, but he didn’t build it for himself – it’s for his children. “Our aspirations are large enough to contain the pursuit of excellence,” he says. Ambition’s never run short in the Mondavi bloodline – but, as Continuum proves, it’s backed up by not just good instincts but the drive, grit and hard graft to make those dreams a reality. The latest release of Continuum is available now

Ch. Ausone: the Vauthier Vision Our 2023 events line-up started with a bang at one of London’s most exciting and newest culinary establishments, Alex Dilling at Hotel Café Royal.  On a typically British February evening, our guests gathered at Hotel Café Royal for a Champagne reception and exceptional five-course meal celebrating one of Bordeaux’s most respected estates, Ch. Ausone. Each course was expertly designed to complement the nine remarkable Saint-Emilion vintages we tasted throughout the night.  The magical evening began with an exploration of the Vauthier family’s other wines in Saint-Emilion: Chx Haut-Simard, de Fonbel, Moulin Saint-Georges, La Clotte and Chapelle d’Ausone. These wines were the perfect introduction to the Vauthiers’ style of Bordeaux – wines of extraordinary precision and finesse. We then moved on to the main event – a vertical of Ch. Ausone stretching from 2003 to 2018, exploring the beauty of this property and how its style has developed under the Vauthiers. Edouard Vauthier – son of proprietor Alain Vauthier and brother to winemaker Pauline Vauthier – joined us to share the property’s fascinating history, guiding us through its distinct terroir and how they work in the vineyard and winery. This wonderful evening and comprehensive tasting provided the ultimate insight into this very special property – and was the perfect introduction to 12 months’ worth of wonderful gatherings with excellent food, wine and conversation. Le Pin from the beginning, with Jacques Thienpont The second event of the year, held at Claridge’s L’Epicerie, was a magnificent celebration of one of the most famous names in wine, Le Pin. With a mere 600 to 700 cases produced annually – a truly minuscule quantity that is dwarfed in comparison to fellow top estates of Pomerol and Saint-Emilion – few people ever get to taste these wines. Those fortunate enough to do so almost certainly wouldn’t have tasted the vintages on show back-to-back in February. Over the course of the evening, guests were treated to 15 incredible wines –  three from acclaimed vigneron Jacques Thienpont’s special Saint-Emilion operation L'If and 12 spellbinding wines from the iconic Pomerol es­tate, concluding with the 1990, 1983 and first-ever Le Pin vintage, 1979. Thienpont and Diana Berrouet Garcia (MD of Domaines Jacques Thienpont) joined us for the evening, sharing remarkable stories about one of the world’s most renowned and mythical producers. During this truly immersive experience, we were able to gain unprecedented insight into the style, philosophy and history of the incredible estate that produces one of the world’s rarest and most in-de­mand wines for collectors. Such was the quality of the wines on show that the world-class food served by the expert L’Epicerie team was almost reduced to a footnote. Seven exquisite dishes were prepared in Claridges’ iconic kitchens – each one designed to complement the remarkable wines that filled our guests’ glasses. Truly exceptional. Schrader Exploration with Jason Smith MS One of Napa’s cult names, Schrader Cellars, was the focus of our third event of the year. During an intimate dinner at Michelin-starred Muse by Tom Aikens in Belgravia, London, guests were treated to a vertical of the greatest-ever vintages (2005-2019) of Schrader’s top cuvée, Old Sparky, which all received perfect scores. These 100-point wines – all from magnum – were expertly paired by one of the UK’s most talented chefs.  Esteemed Master Sommelier Jason Smith expertly guided us through Schrader’s best vineyards and terroirs before enthralling us with tales of six vintages that have become some of the estate’s most coveted and rarest wines. While tasting these exceptional vintages at the gorgeous two-storey Belgravia townhouse, Aikens hand-served and enthralled guests with the seven courses he had prepared for the evening. This was an exploration of one of the world’s most decorated and mythical wines which showcased Napa Cabernet at its very best. During a remarkable five-course meal, prepared by Hélène Darroze’s three-Michelin-star team to complement the 23 wines on show, guests enjoyed a mini vertical tasting of La Rue aux Vaches, followed by a selection of Premiers and Grands Crus from Alvina’s grandfather’s estate Domaine Paul Pernot and her own eponymous fledgling property. Following a tasting flight (2021-2018) of Alvina Pernot’s Rue aux Vaches vineyard – bottled exclusively in magnum – guests were then served five mini verticals of Domaine Paul Pernot’s Folatières, and Grand Crus Bienvenues-Bâtard and Bâtard-Montrachet from the family’s cool cellars in Puligny. The supremely talented husband-and-wife winemaking duo joined us on the night to offer insight into these special vineyards and wines, and the contrasting styles of the two properties. It was a true exploration of Pernot, a key and treasured partner for FINE+RARE, across many of their greatest wines. Lafite Rothschild through the ages A landmark event of the year, Ch. Lafite Rothschild through the ages was the first experience we held in UK held outside London. Waddesdon Manor in Aylesbury was the natural choice for the occasion because of its iconic grandeur – and connection with the Rothschild family. Following a Champagne reception in Waddesdon Manor’s private gardens on a balmy summer evening, guests sat down to an enviable six-course dinner accompanied by an incredible flight of ex-château back vintages of Ch. Lafite Rothschild, from 1960 to 2010, and two beautifully mature magnums from Lafite’s sibling estate, Ch. Duhart-Milon. Domaines Barons de Rothschild International Director Jean-Sébastien Philippe joined us for this remarkable journey exploring one of Bordeaux’s most renowned First Growth châteaux before we retreated to the charming, characterful Five Arrows Hotel located a stone’s throw from Waddesdon Manor. Cheval Blanc In June, we held our first event that included a magnificent overnight stay outside the UK in the historic wine-producing region of Bordeaux. Over the course of two wonderful days, guests walked among the vines and cellars of two iconic estates – Ch. d'Yquem and Cheval Blanc. Two of the region’s most respected winemakers, Pierre Lurton and Pierre-Olivier de Clouet, joined us as we explored these highly coveted estates through private vineyard and cellar tours, incredible culinary experiences at both properties and superlative flights of ex-château vintages.  Following a lunch and tasting at Ch. d’Yquem – including magical vintages dating back to 1939 – and a 14-flight Cheval Blanc dinner, guests settled into the breathtakingly beautiful five-star Château Hôtel Grand Barrail for the night, located a short distance from the neighbouring medieval town of Saint-Emilion and some of the world’s most coveted fine wine producers. The wines, company and setting were truly magnificent and we all walked away from the experience with a greater appreciation for the two wine estates. Belle-Brise: discovering the walled garden of Pomerol Our penultimate event of 2023 was a first for our experiences programme – a dinner in the United States hosted by our US arm, Vinfolio.  In November, an intimate group of guests gathered at three-Michelin-star SingleThread in Healdsburg (Sonoma County, California), to celebrate FINE+RARE favourite Ch. Belle-Brise.  Over the course of the evening, the small group were fortunate enough to taste a 23-vintage flight of Belle-Brise dating all the way back to the first commercial release in 1993. All those in attendance were gifted the rare opportunity to unravel the golden thread that connects each vintage from this special Pomerol estate. As Scott Turnbull MS – Vinfolio Director of Private Clients – explains in his Editorial piece about the night, elegance and finesse were the common themes at one of the largest Ch. Belle-Brise retrospective tastings ever held.  Host for the evening, Turnbull, shared stories from the estate’s short but mighty history, including the château’s ability to overcome adversity in its first few commercially released vintages to produce what is, for many, a desert-island wine. Two decades of Roumier’s Bonnes-Mares with William Kelley Our 2023 events calendar drew to a close in spectacular fashion with a superlative showcase of 20 vintages of one of the most legendary bottlings on the fine wine landscape, Domaine Georges Roumier’s Bonnes-Mares. An international group of collectors and wine enthusiasts from the Czech Republic, Mallorca, Geneva, San Francisco, London and Burgundy (in the form of the evening’s compère, acclaimed Burgundy authority Wine Advocate’s William Kelley) gathered on an autumnal night at London’s prestigious Connaught Hotel for an exploration like no other.  Following a Champagne reception, five incredible courses prepared by Hélène Darroze’s expert culinary team were served. Each one was designed to complement the stunning wines from two remarkable decades (2000)-2020) in the estate’s history. Throughout the evening, Kelley provided fascinating insight on each flight and vintage, bringing the wines to life for all those present. It was a truly memorable occasion, gathering to taste a flight of wines we are unlikely to have the opportunity to encounter again any time soon. Looking back at our 2023 events

Until I joined Vinfolio, the US arm of our business, I hadn’t heard of Ch. Belle-Brise. But I rapidly fell in love with this little-known, yet much-loved Pomerol property. Our retrospective was to be held at three-star Michelin SingleThread in Healdsburg (Sonoma County, California), and examine 23 vintages of Belle-Brise, from 2020 all the way back to 1993. As proprietor Henri-Bruno de Coincy unfortunately couldn’t make it to our event, I was tasked with hosting on his behalf, and gave him a call to learn more about what he feels are the most important details to share about his property. (My degree in French, which was instrumental in my becoming a sommelier, proved to be quite useful. While M de Coincy speaks four languages, English is not one of them.) During our conversation, I confirmed the embarrassment of riches as far as what sets Belle Brise apart from its illustrious neighbours. Located in the southwestern corner of the already diminutive Pomerol appellation, Belle-Brise consists of only two hectares (around five acres) of vines. Planted to 80% Merlot and 20% Cabernet Franc, the vines average 70 years in age, with some 110 years old. The vines are farmed biodynamically, using horses to complete the necessary labour in the vineyard. While the subsoils have a mix of clay and sand, they also possess the famous crasse de fer – the iron-rich sand that is said to impart the aroma of truffles, a facet which only reveals itself as the wine ages. M de Coincy refers to Belle-Brise as his “jardin” (indeed, while the family spends much of their time in Armagnac, the house at the heart of the vineyard is very much their second home) and takes great pride in the fact that everything can be harvested by hand in a single day. 
Wine has been made at Belle-Brise since the 18th century, but the property did not see its first commercial release until 1991, after M de Coincy acquired the estate, with the wine sold only to family and friends before that date. If you are familiar with your Bordeaux vintages, you will know that 1991, ’92, and ’93 were all extremely difficult harvests. While not the auspicious start he may have hoped for, it did offer an opportunity to explore the vineyard and learn how to best care for it. Today the winemaking is identical from year to year, with the vintage – and site – speaking loudest. The wines are fermented in concrete before being placed in a third new, a third second-use and a third third-use 400-litre barrels, the traditional size used for Armagnac, rather than the more conventional 225-litre Bordeaux barrique. The Coincy family has been making Armagnac for 32 generations and over 700 years, so the exact size is not arbitrary, but the decision to use larger barrels is also deliberate – reducing the impact of the wood on the final wine. While the story of the château and the history of the De Coincys are both compelling, I must return to what is most important to keep in mind when tasting Belle-Brise: elegance and finesse. Serving Pomerol with kaiseki-influenced Japanese cuisine (as at SingleThread) may not be the obvious choice, however the delicacy of the wines ensured that the harmony of the dishes was kept intact, leading to many unexpected moments of delight. Unsurprisingly, exceptional vintages were beautifully cohesive and balanced, however, it was the less well-respected vintages (2011, 2004, 2002, 2018 and 2008, among others) that truly showed how attention to detail and care can surmount challenges that nature may present. While we were not able to taste every vintage of Belle-Brise (with the tiny volumes produced, the family simply doesn’t have stocks of everything), this retrospective tasting was one of the largest ever presented. The favourite vintage among guests on the night was 2011, a vintage which also came up in my conversation with M de Coincy, as it has been chosen as the “desert island” of wine professionals and aficionados many times before. The most interesting flight for me came later in the meal, with the 2004, ’03, and ’02 grouped together. These vintages all presented different challenges during the growing season. The 2002 saw extreme rain in many parts of France, with heavy downpours affecting flowering and fruit set. The 2003 saw a summer with extreme heat, which taught many lessons that were applied in 2022. Lastly, the 2004 had a larger harvest on the whole, but the vintage is often forgotten, left in 2005’s long shadow. In the glass, however, the 2002 was pure and bright, with the 2003 showing its suntan but still refined, and the 2004 had a concentration and depth that was remarkable (especially as the wines were all around two decades old).  Regardless of vintage, elegance and finesse were constant throughout the entire evening, reminding me of a concept I learned in one of my French philosophy classes at university. If my memory serves me correctly, Michel de Montaigne proposed in his Essais the concept of a “forme maîtrise” or master form when referring to the evolution of a person as they age, and as something that cannot be easily defined in simple terms. While I am now much different than I was at age five, 15, 25, etc, there is still a governing sense of self (or possibly a single thread) that connects the person writing this to the child I once was. As we continued to taste through the vintages of Belle Brise, this forme maîtrise kept asserting itself, via the performance of the wine in the glass, reminding me of the “garden” where these wines were made. As many of the variables seen at other châteaux (differing blends, oak regimes, etc) remain constant at Belle-Brise year after year, one can focus on the vintage and its effect on the wine in the glass. This results in a singular experience, when one can truly feel the sense of place that only certain wines can offer. Tasting Ch. Belle-Brise: 1993-2020 vertical 2020 Ch. Belle-Brise: The 2020 Belle-Brise has an opulent nose with ripe fruit – plums – and violet. It’s already very approachable now, with remarkably fine rounded tannins. Plush. 2019 Ch. Belle-Brise: The nose is packed with ripe raspberry fruit and vanilla cream, currently more open than the 2020, with lovely sweet spice too. The tannins are slightly firmer with bright acidity – this is generous but focused. Very impressive. 2018 Ch. Belle-Brise: From a hot vintage, this is a very concentrated Belle-Brise with blackberry and black plum. Brooding, powerful and structured, the 2018 shows a very dark fruit profile, and needs a little more time to integrate fully and show its best – but this will be a wine for the ages. 2017 Ch. Belle-Brise: Packed with red fruit, this is open and expressive, fragrant and floral. The palate is tighter and more linear in style versus the warmer vintages that preceded it; the wine precise and delicate. 2016 Ch. Belle-Brise: This is a bold and age-worthy Belle-Brise. The nose is ripe, layered with dried fruit, prune and hints of dark chocolate. The wine is big and dense, with ripe tannins, and will benefit from more time in bottle. This is built to go the distance. 2015 Ch. Belle-Brise: The 2015 offers a nose of sweet, ripe fruit. It’s plush and mouth-filling, yet retains amazing elegance and great freshness. There’s beautiful balance, with very fine tannins that frame the fruit. 2014 Ch. Belle-Brise: This is just starting to reveal some maturity, with cedar, hints of truffle and tobacco alongside the plum fruit. It’s an earlier-drinking vintage versus the 2015, for example, but has lovely restraint and is showing beautifully right now. 2012 Ch. Belle-Brise: This may have been a tricky year, however the 2012 Belle-Brise shines – with bright fruit and violet florals on the inviting nose. The palate is delicate, supple and charming – a very pleasing wine packed with appeal. 2011 Ch. Belle-Brise: Another less lauded year, the 2011 is not as powerful as warmer vintages, but is still an hallmark Pomerol from this estate. It’s layered with plums and spice, the wine rounded, smooth and welcoming in style, 2010 Ch. Belle-Brise: The 2010 is a concentrated, powerful and muscular Belle-Brise that is destined for the long-haul. The palate is mouth-filling and tightly packed at this still comparatively youthful stage, even 13 years on, with dense berry fruit. 2009 Ch. Belle-Brise: This bottle wasn’t showing flawlessly – the tannins prominent and fruit not as concentrated as in other bottles we’ve tasted, although it still showed toasty, coffee complexity on the nose. 2008 Ch. Belle-Brise: This is beautifully expressive, with notes of mint, violet and plum on the nose. It’s fragrant with herbal lift, while the palate is vibrant, fresh and nervy. A joy from this less famous vintage. 2007 Ch. Belle-Brise: This may not be a top year, but Belle-Brise produced a lovely wine that is beautiful at the moment. The nose is evolved with earthy tones, truffle, cedar and tobacco. Ready to go, this is open and elegant, with lovely resolution on the palate. 2006 Ch. Belle-Brise: This is absolutely textbook Pomerol from Belle-Brise in 2006. The nose is lovely, with opulent fruit, while the palate is smooth and velvety, the tannins gorgeously polymerized. It’s still fruit-forward but really delicious. A delightful wine. 2005 Ch. Belle-Brise: This top-rated vintage offers a brooding, dark-fruited nose, with notes of chocolate, earth and truffle. The palate is dense and powerful, with chalky, rich tannins that cloak the layers of damson, cigar box and mushroom. 2004 Ch. Belle-Brise: The 2004 shows remarkable concentration and depth. The wine is mature, showing an evolved nose of cedar, tobacco and forest floor, while the palate is almost fully tertiary, but with ethereal dried fruit. Fantastic. 2003 Ch. Belle-Brise: Although this shows the warmth of the year, with baked fruit, it’s still refined, with resolved tannins. Unlikely to evolve further, so worth drinking up. 2002 Ch. Belle-Brise: This is showing beautifully – pure and bright, with aromas of dried flowers, dried cranberry and prune alongside lifted spice notes – cardamom and clove. On the palate, it’s elegant, with fruit still driving through to the refined finish. Haunting. 2000 Ch. Belle-Brise: This is full of ripe plum fruit, damson and vanilla with a sweet earthiness. It’s still amazingly fresh and tasting impressively young. It’s got a great backbone and plenty of life in it yet, but delicious now. 1999 Ch. Belle-Brise: Notes of forest floor, earth and dried leaves dominate the nose, accompanied by more delicate potpourri aromas. This is a beautifully delicate, fine-boned wine with a long, lingering finish.  1995 Ch. Belle-Brise: The 1995 is still surprisingly fragrant – with dried cranberry and redcurrant fruit alongside dried herbs, cedar and sandalwood aromas. It is alluring and enticing on the nose, leading to a seamless, lifted palate. 1994 Ch. Belle-Brise: The nose of the 1994 combines expressive dried orange peel with richer prune and raisin fruit, as well as savoury, earthy notes. On the palate, this offers richer fruitcake tones – with currants and spice, and impressive depth. 1993 Ch. Belle-Brise: This 30-year-old Claret is remarkable. It was only Henri-Bruno’s third vintage, and it is evolved but very much alive. The nose combines forest floor and more herbal tones, while the palate is silky, supple and perfumed. Chris Phelps never really meant to start his own winery. But fate had other plans.  Wine had always been part of life, just in the background. Growing up in Livermore, east of San Francisco, Phelps’s parents would buy a ton of grapes from Napa or Sonoma, and make wine each year for themselves. Phelps even dug out a cellar by hand for them as a teenager. Nevertheless, when he set off for UC Davis, it wasn’t to study wine, but medicine. To pay for university, he took a job as a firefighter in Idaho (“kind of scary but super fun,” he tells me). By chance, he met a wine-geek friend, one who eventually convinced him to switch from pre-med to oenology. At Davis, he happened upon Alain Bertrand – one of the first scientists to use gas chromatography to delineate the different aromatic compounds in wine. The Frenchman didn’t speak much English, and Phelps spoke French – so they ended up becoming friends. Bertrand suggested Phelps attend the University of Bordeaux for a year after graduation. There, Phelps tells me, everything “started to fall into place”. Until then, wine had been intellectually interesting – but, during his time in France, it became much more.   There, another professor pushed him to apply for an internship – just in time for the 1982 harvest, a vintage that would turn out to be legendary. He already had offers from both Ch. Simon (Barsac) and Ch. Beauregard, but then was given the opportunity to interview with JP Moueix (of Pétrus). Unusually Christian Moueix insisted on joining the interview himself, alongside winemaker Jean-Claude Berrouet, and promptly gave him the job. The confident young American, however, said he’d think about it – and set off for a holiday in the south of France with his fiancée. Little did he know that Moueix had just bought a swathe of vineyard in Napa – and was planning for the future.  A few weeks later, Phelps was in Nice and bought three postcards from the Chagall museum – ready to make his decision about the three possible roads that lay ahead of him. He decided to take the position at Moueix, posted his rejections and acceptance, and carried on with his holiday. But, as harvest time approached, Phelps hadn’t heard anything back. He called Berrouet – only to find out that the French postal service had let him down, and the job at Pétrus had been given to someone else. It seemed like his luck had run out, but Berrouet said he might have another idea and would call him back in a few days.   While Berrouet couldn’t offer him anything as prestigious as Pétrus, he found Phelps a job at Ch. des Laurets in Puisseguin-Saint-Emilion – but he wouldn’t just be an intern, he’d be running everything. It was, Phelps said, a “trial by fire”, especially given his only hands-on experience to date had been six months at Louis Martini. He worked non-stop with just one cellar hand to help during the day, and managed to make it through the season.   When the wines were safely in barrel, he went to dinner at Christian Moueix’s house – where, sipping Champagne in the library, Moueix told Phelps about his plans for his Napa project, Dominus – and asked if he’d be the winemaker. “Of course, I said no,” Phelps tells me – recalling how the Frenchman opposite visibly sputtered at the American’s cheek (again). Phelps said he needed more money to live in Napa (and support his bride-to-be) – and more experience. Amazingly, Moueix agreed to let him start from 1984, given the 1983 vintage was set to be just a handful of experimental barrels, and to a pay rise. Off Phelps went, working around California and wintering at Pétrus before returning to lead the team at Dominus.   “We figured it out as we went along,” Phelps says, looking back on the early days of what is now one of Napa’s most prestigious estates. Today they might have the iconic Herzog & De Meuron winery, but things were much more rustic at the beginning – with a small team and little infrastructure. Phelps eventually moved on, joining Caymus in 1996 – but it’s what started happening after-hours, around his day job, that is interesting.  In 1990, Phelps met Larry Bettinelli at a Christian men’s retreat, and hit it off. It was only when they met up for lunch later that they realised they were both in the wine business, with Bettinelli a fifth-generation farmer who was growing grapes. Bettinelli wanted his vineyards to be the best in the valley – but he needed feedback on the fruit so that he could adapt his viticulture. He and Phelps hatched a plan: each year, Bettinelli would give Phelps a ton of fruit, trialling different clones, rootstocks, vine spacing and trellising, harvest methods, and Phelps would make a wine with it. The project was purely intellectual, so the two families drunk the wine themselves, and it also started being used as the altar wine at Phelps’s church (a much higher-grade communion offering than most). For two decades, they kept making tiny batches of their first-class “homebrew”, and Bettinelli became one of the valley’s best growers, working with an increasing number of sites around Napa.  Destiny seemed to abandon all subtlety in 2005. Phelps was hiking through the Sierra Nevada, leading a Scouts expedition, when they were struck by lightning. Two of the group died and Phelps was knocked unconscious. Unsurprisingly, it shook Phelps to the core. “Life is our most precious gift,” he says, “and if we use wine appropriately, it can enhance our lives.”  Two years later, Phelps was on top of a tank that had just been filled with crushed fruit from a relatively new Bettinelli site – and the smell was intoxicating. Following pure impulse, Phelps asked if he could – rather unconventionally – buy the tank’s contents, and Bettinelli said yes. Ad Vivum – inspired by the Latin “vinum” for wine and “vivere” to live, combined with “ad” which translates as “to” or “towards” – was born.  The vineyard was Sleeping Lady (previously Reese), the southernmost vineyard in Yountville, at the foot of the Mayacamas and on the southern end of the valley’s famous bench. There’s a flow of underground water that feeds a creek, with sufficient clay under the gravel and sand to retain water during the dry summer – and has, in Phelps’s words, a “beautiful ability” to self-regulate. Various other producers work with the vineyard, but his two blocks (representing a mere 1.5 acres) are right at the top of the vineyard, below a steep slope that aids the flow of cool air through the site at night. For him there was something special about these plots – producing fruit and wine with what Phelps describes as a “grace note”; it’s a whisper of something that takes the wine to the next level.  In a good year, production for Ad Vivum is 450 cases – but Phelps isn’t looking to grow. He makes one wine, from one site – and that’s the way he wants it to be. The wine is undoubtedly informed by his Franco-American roots, with an elegance, freshness and savoury structure that complements the plush Napa style. As he says, “I try to build wines that speak for themselves.”  Phelps’s – and Ad Vivum’s – story is one of happenstance. Or is it? With a man as devout as Phelps, it seems hard for anyone to believe it’s all an accident – and as Phelps himself says, looking back, it feels perhaps like it’s all part of a master plan.  Explore all current listings of Ad Vivum or read more about California
