For good or for bad, the 2021 was a vigneron’s vintage, a year that required every bit of nous to circumnavigate the many issues that plagued the growing season. With an early budbreak and one of the latest harvests on record, it was a long and exhausting vintage for everyone involved. This was by no means a vintage that made itself – and its success was determined by the actions of man not nature. Whereas normally there tends to be quite a bit of variation between the sub-regions of Bordeaux throughout the growing season, in 2021 things were decisively challenging everywhere. All were initially threatened by frost, followed by mildew pressure, excessive rainfall in June, cool summer temperatures and a general lack of sunshine throughout the spring and summer months – only to be rescued in the final sunny weeks leading up to harvest. Some unlucky enough (mainly around Sauternes) also suffered hail damage prior to harvest. Despite the homogenously bad weather, the varying soils and varieties throughout the region all reacted quite heterogeneously, meaning some suffered more than others. Such were the manhours required in the vineyard in 2021, production and quality were going to be badly affected. Bear in mind this was all still at a time when Covid-19 was still a pressure point for employment, as noted by a number of wineries we visited. The mild and very wet winter brought an early and uneven budbreak, as early as 10th March in Pessac-Léognan and 15th March in Saint-Emilion – which was a full two weeks ahead of normal. This was followed by unseasonably warm weather, Ch. Figeac in Saint Emilion registered 25˚C, resulting in the vines’ quick acceleration of growth. With the vines already so advanced, the threat of spring frosts was all too apparent. Right on cue, temperatures plunged at night.  The 6th, 7th and 8th April saw black frosts cause significant damage across the region. Those worst affected in the classified sites were in Sauternes and Pessac-Léognan – with some châteaux in Sauternes witnessing their entire crop wiped out. The threat of frost was a prolonged agony for many, lasting right up until the 5th May, with temperatures recorded as low as -5˚C. For the Moueix estates in Pomerol, the combination of wind turbines and smudge candles could raise the temperature in the vineyard up by 2˚C – enough to protect the grapes. Other properties without such resources weren’t so lucky. Ch. Margaux's white wine vineyard is famously susceptible to frost. After installing a sprinkler system throughout the whole 8.5 hectares, the system malfunctioned, not working on 1.5 hectares where they lost everything (fortunately the remaining seven escaped harm). The frost damage was far from democratic, with estates within the same appellation seeing widely different levels of damage. As always, the châteaux on the Left Bank closest to the Gironde such as Ch. Léoville Las Cases and Latour came away largely untouched by the frost. Further north in Saint-Éstephe, châteaux such as Calon-Ségur and Montrose were also unaffected – not just due to their close proximity to the river. The cooler clay-rich soils of the appellation mean budburst is always delayed, and with the vines not as advanced, damage was limited. The risk of frost threatened Saint-Emilion for 10 days straight and led to a huge amount of work in the vineyards protecting the vines. The vineyards on the lower plains were worst affected, Croix Canon for instance, while Ch. Canon and neighbouring Ch. Berliquet up on the limestone plateau were spared, due to the vineyards’ fortunate south/south-west exposition – the brow of the hill protecting the vines from the freezing northeasterly winds. Vines basking in the sun at Ch. Latour If there was one moment of calm throughout the 2021 growing season, it came at flowering. Clement, dry weather engendered successful flowering, though rains arrived at fruit-set, leading to coulure for the Merlot. A huge deluge fell in June – as much as three times the month’s average rainfall. The damp, cloudy conditions saw the widespread outbreak of mildew that remained throughout June, July and into August. Bordeaux’s proximity to the Atlantic and the naturally high levels of humidity this brings have always made it susceptible to mildew, but for many vignerons we spoke to, this was the worst outbreak they had ever seen. The poor climatic conditions saw coulure and millerandage (the development of fewer and differently sized berries) badly affecting the Merlot on the Left Bank. This is why you’ll see such high proportions of Cabernet Sauvignon in the blends this year – with Cabernet being much less susceptible to both conditions. Despite the blanket attack of mildew, its effects varied from property to property. Ch. Margaux believed the mildew outbreak was the worst they had ever seen, yet for them, it never reached the grapes, only the canopy – allowing them to protect the fruit from damage. Perhaps their largely Cabernet Sauvignon plots made it easier to protect; Merlot certainly wasn’t so lucky. Further north in Saint-Julien, Ch. Ducru-Beaucaillou chose to leave the grass cover throughout the growing season to soak up the humidity and reduce the rain splash which spreads the mildew to the vines. Many sprays later and the yields were still significantly impacted; their Grand Vin is 98% Cabernet Sauvignon (the highest proportion ever) and production is the lowest on record, cropping at 20hl/ha. Ch. Pontet-Canet in Pauillac was devastated by mildew in 2018, losing two thirds of their crop. Despite the bigger outbreak in 2021, production was down only 15% – clearly having learnt how to better cope with the issue. The estate’s Justine Tesseron emphasised that you had to react fast to protect the grapes – you had to get out into the vineyards immediately after each rain episode to stop the spread. It was the year their newly built “tisanerie” came to the rescue, making them much more efficient in preparing their biodynamic sprays and reducing the overall impact. Many estates including Ch. Cos d’Estournel and Calon-Ségur carried out early de-leafing to reduce the impact of the disease. It was a huge risk. If the climate switched to more intense sunshine, the crop would have suffered significant sunburn. But the intensity of the sun, fortunately for them, was never that strong. With such high levels of rainfall in the summer months, the vignerons faced their next issue – a slow and uneven véraison. That moment where the energy of the vine switches from producing its canopy to ripening the grape is set off by a period of hydric stress – something which was not forthcoming in 2021. An event that typically takes place over two weeks was spread over four. The high rainfall also meant bigger berries and dilution was a concern, particularly as they edged towards harvest, worried the skins could burst and rot would set in. Fortunately, things finally started to dry up in August and, while temperatures remained mild, the grapes pushed through véraison. The September weather finally brought some hope for the vintage and, according to many vignerons, was their saviour. Sunny days and cool nights were ideal for grapes to concentrate, retaining freshness, while producing the beguiling aromatics that are so distinct in the 2021 wines. There was a little more rain in mid-September, most notably in the Médoc, which brought concern over rot, but any significant damage was held off by a dry and sunny October. Smudge pots or "bougies" between the vines, on hand to offer protection against frost The northern appellation of Saint-Estèphe was noticeably drier than appellations to its south, with hydric stress starting in July and “perfect weather” followed in August according to Ch. Montrose’s Lorraine Watrin. She compared the growing season to 2014, which was particularly successful in the appellation. By the end of September, throughout the regions, most of the Merlot was picked. Of course, the Sauvignon Blanc and Sémillon grapes, capable of growing in much cooler, wetter conditions, were much less affected by all of Mother Nature’s shenanigans. For the estates that avoided the frost, the whites reached good volumes and the fresh temperatures of the growing season proved ideal for the varieties. The whites were largely picked in the first two weeks of September and the top examples proved exceptional. For the reds, Mother Nature had one more card to play. Weather forecasts for the first weekend in October predicted heavy storms and more rainfall. With the large berries close to ripeness, a heavy storm could decimate the later-ripening Cabernets and would prove catastrophic for many on both the Left and Right Bank who rely on large proportions of Cabernet in their wines. With little choice, most ran the risk, and held out picking until the storms passed. Thankfully Mother Nature’s trump card was never played. Amazingly, the forecasters got it wrong, and the storms never came. Finally, the Cabernet was picked under sunny skies. Many châteaux such as Calon-Ségur held out as long as possible and were harvesting right up until 13th October – their latest harvest since 2012. What is extraordinary about the 2021 vintage is the complete inverse effects of the previous three years. Three vintages of relative drought, plagued with concerns over rising sugar/ alcohol levels, vines blocked from maturation due to hydric stress, and a genuine concern that the wines would lack full phenolic maturity, due to the compacted ripening season. Every one of these concerns was turned on its head in 2021, producing wines that are the opposite of the 2018, 2019 and 2020s. This unique season has put technology advances in Bordeaux to the test – from weather stations, UV boosting to state-of-the-art machinery – and at its best, they’ve defied the odds. A couple of decades ago, a growing season like 2021 would have produced very little wine at all, but today the Bordelais have proven that man can – at least for now – manage almost everything Mother Nature throws at them. The 2022 Bordeaux vintage may only just have made it into the winery, but it’s already one for the record books. “Unique”, “historic”, “completely new”, “extreme” – the growing season brought never-before-seen conditions to Bordeaux. And producers are clearly excited about the potential of the year.  While 2021 saw a cool, wet year with chaptalisation widespread, 2022 was hot and dry. From February onwards, temperatures were consistently above the 30-year average (by 1-3˚C), while rainfall was consistently lower than the 30-year average. Indeed, Météo France (France’s national weather service) reported that July was the driest since 1959. The weather was so dry that certain appellations were even permitted to irrigate – Pessac-Léognan on the Left Bank, and both Pomerol and Saint-Emilion on the Right.  Pierre-Olivier Clouet (Technical Director at Ch. Cheval Blanc) explained how the region had experienced dry periods before – pointing to 1976 as an example –but never before had they seen practically no rain from budbreak to harvest. This drought, combined with the heat (with four heatwaves bringing temperatures of up to 40˚C), was remarkable and made for unprecedented circumstances. He believes that the consistent dryness was key, with the vines having to self-ration from the start of the season to survive. Indeed, the winter was relatively dry, with 200 rather than the normal 400mm. Echoing Clouet’s opinion, Ch. Margaux CEO Philippe Bascaules believes that the dry April and May forced the vines to drive their roots deeper.  Budbreak was early, and – as is now almost the norm – frost struck the region at the start of April, with the mercury on 3rd and 4th April registering as low as -7 or -9˚C in some places. Noëmie Durantou Reilhac of Ch. l’Eglise-Clinet noted that they only had to use “bougies” (smudge pots) to protect the vines over two weekends, however because the cold weather fell on weekends some people struggled to get workers out into the vines. With their small holdings, the Durantou family could manage it themselves. She also noted that it was a particularly unusual and severe black frost, with tunnels of colder air that caused damage and weakened some vines. Despite this, the Durantou vines escaped unscathed. With investments made and experience gained in recent years, few saw any significant impact – there was a little at Quinault l’Enclos, but none at Cheval Blanc, and the damage at Ch. Margaux wasn’t even worthy of calculating – perhaps 5% on five blocks.   Flowering was even and as was véraison, however Durantou Reilhac reported that the grapes then took a long time to all change colour. The leaves started drooping, showing the signs of heat stress towards the end of July. She reacted by doing an early green harvest, so that the vines could focus their energies on a smaller crop – but highlighted it was important this was done early.  At Ch. Margaux, Bascaules noted that younger vines (those under 10 or 15 years old) suffered most – not having the deep roots of more mature plantings. At Cheval Blanc, they noted that it was especially those younger vines on less water-retentive gravel and sandy soils that struggled. With the high temperatures, some producers reported vines shutting down, while others said it wasn’t an issue.   Guillaume Pouthier at Ch. les Carmes Haut-Brion emphasised how the night temperatures were what really set the hot summer apart from a year like 2003. While there were a similar number of days over 35˚C, in 2003 there were eight or nine nights with temperatures above 25˚C; in 2022, it reached a maximum 20˚C in Pessac-Léognan overnight. This significant diurnal shift helped preserve aromatic finesse.  At Carmes, they worked the soil in the evenings to help retain water. To shield the grapes from the sun, they also kept a full canopy, not de-leafing at all, and used a mixture of white clay and talc to protect the grapes, which kept the internal berry temperature as much as five to 10˚C lower.  Unsurprisingly given the conditions, harvest was early. Noëmie Durantou Reilhac returned from holiday on 16th August and was almost tempted to pick then. Their team ended up holding off until 31st, while Cheval Blanc started on 29th August, finishing on 20th September. At Carmes, they picked from 5th September to 9th October, while Ch. Margaux picked from September 8th, deciding to do two passes through every block to sort out any shrivelled or sunburnt fruit.  There are two important elements to acknowledge: hail and fire. On June 20th and 21st, there were extraordinary hailstorms – with hailstones the size of golf balls. These were, however, extremely localised and struck mainly lesser vineyards in the Haut-Médoc and Médoc. Next were wildfires that raged through the region in July and August. While the fires didn’t come close enough to cause any damage to vineyards, there were fears over possible smoke taint at certain addresses. So far, however, none has been reported, with the belief that the grapes were early enough in the cycle and still had sufficiently thick skins so as not to be impacted.  In these unique conditions, the New World was a helpful reference point. Philippe Bascaules noted how more and more Bordeaux has to ask the same questions as California does, while Pierre-Olivier Clouet felt that his experience of Malbec in Mendoza was particularly useful. “We were ready to fight with this kind of vintage,” he explained.   “I think it’s going to be a big year for Merlot,” Durantou Reilhac said. “I’ve never tasted Merlot grapes with such power and amazing aromatics.” Almost in spite of the conditions, there’s perfect balance – the hitch, unfortunately, is that there simply wasn’t much of it. With the hot, dry conditions the crop was small – with tiny, thick-skinned berries. Pouthier at Carmes highlighted just how small they were – with Merlot around 1g versus 1.3-1.4 normally, while Cabernet came in at 0.-0.9g versus the normal 1.2. Carmes’s yields were down about 20%, at around 35hl/ha on average. At Cheval Blanc, they managed 30hl/ha – the same level as 2021, while at Ch. Margaux it was one of the smallest crops for a long time, with a measly 25hl/ha on average (less than 2021, 2020, 2019 or 2018). Yields tended to be more generous on plots with clay subsoils, although Durantou Reilhac found that their vines in Pomerol and Lalande-de-Pomerol suffered more than those in Saint-Emilion and Castillon, with their volumes reduced by at least a third.  Given the small and thick-skinned berries, managing extraction was key. Interestingly Durantou Reilhac found that the berries were so firm that more force was needed to extract the colour and tannin. While conventionally seed tannins aren’t desired, she highlighted how remarkable they were this year – popping in the mouth, “noble tannins” with flavours of coffee and toast, and no greenness at all.  It’s almost the opposite at Carmes, where Pouthier believes that – especially in 2022 – their passive extraction via infusion was essential. They lowered the temperature and extended the time (two to five days more than normal, at 25-26˚C versus 30-31˚C). Looking at the numbers, the level of tannins (IPT) is 15% higher than 2018 or 2020 at Carmes. Similarly, Ch. Margaux will be reducing maceration times, looking at 12-18 days rather than 15-24 and keeping temperatures cool at 25-28˚C. The risk, from Bascaules’s view, is to over-extract given the high levels of tannins.   Malic levels are remarkably low this year – the lowest many have ever seen (citing levels as low as just 0.3g/l). At Cheval Blanc, Pierre-Olivier Clouet noted that it was the highest pH they’d ever seen at 3.9. That said, the aromatic maturity is – in his words – “perfect”, with incredibly high levels of tannins that are notably “silky, smooth and ripe”. For Pouthier, the pH is similar to that of 2016 (3.6), even with the low malic levels, and at Ch. Margaux it will similarly be around 3.6-3.7.  Alcohol levels are back up to the new normal from 2021, with Cheval Blanc set to be around 14%, and levels between 14.5 and 15% across the Durantou estates, and similar at Ch. Margaux, where it’s higher than in 2018.Although potential alcohol was sitting at 14.5% at Carmes, a combination of native yeast (which is less efficient at converting sugar to alcohol) and a high percentage of whole-bunch fermentation means the final wine is likely to be closer to 13.3%.   With the uniquely dry, hot conditions, it’s hard to compare the vintage to any other – and it’s like no other year that the Durantou team remembers. Clouet fears that people will be tempted to compare the year to 2003, however it was so different. “The grapes were juicy and full this year, there was no sunburn and the vines didn’t drop all their leaves due to heat stress,” he explained. Indeed, the vines at most addresses still looked green and healthy even in mid-October. He compares it to 2009 for the silkiness and high alcohol, and perhaps 2011 for the high concentration of tannins.   Philippe Bascaules similarly thinks people will compare it to 2003, but for him it’s actually closer to 2018 – with slightly higher alcohol but also higher acidity – or perhaps 2005 and 2010. Guillaume Pouthier feels it’s impossible to compare the wines of modern Bordeaux with any other vintage, for he is part of a new generation focusing on balance and drinkability, as well as complexity and the ability to age.   Tasting the first ferments at Carmes, this is an incredibly exciting vintage. There was no sign of over-ripeness, with incredibly concentrated, vibrant fruit, and even at this infantile stage the significant tannins were silken. The year was far from easy, presenting almost the opposite challenges of 2021, and it remains extremely early to judge. BURGUNDY 2021: THE GROWING SEASON After three warm years, 2021 marked a return to the sort of weather traditionally associated with Burgundy – and all its challenges.  The winter was warm and wet – “too warm”, Frédéric Weber at Bouchard told us. He remembers finishing pruning in just a t-shirt in March. The vines started growing enthusiastically, with early budbreak, only to be struck by a cold spell at the beginning of April – as frost struck the whole of France. The nights of 6th, 7th and 8th April were devastating, especially 7th. Temperatures dropped to -8˚C in places – temperatures at which candles, helicopters and wine machines could offer little help.  
Images of the Côte de Beaune littered with a milky way of candles filled social media, and vignerons could do little but pray. For the early-budding Chardonnay, 80% losses were normal, with some producers in Chablis losing everything. The humid conditions, with snow falling, made matters worse – unusually this combination means that lower-lying village sites were less impacted than the Grands Crus (higher up-slope, where more snow fell). Indeed, if producers had lit candles (or “bougies”), the warmth melted the snow, which then froze and the buds were burnt by the morning sun – cruel retribution for trying to protect their livelihood. This severe, black frost (“le gel advectif”, as Florence Heresztyn explained) was savage – caused by a mass of cold air from Siberia. Chardonnay (and therefore especially the Côte de Beaune) was impacted more, as were any earlier-ripening Pinot Noir sites, such as Cazetiers or Combe au Moine. Candles can normally only increase the temperature by 2˚C, however some producers noted how a collective effort could make a difference – with a high-density of candles concentrated on an area. Erwan Faiveley had installed electric wires in their Bâtard-Montrachet and Bienvenue-Bâtard-Montrachet, as used previously in Chablis, which saved their crop in these plots, but other parcels were devastated. As Thibault Gagey of Louis Jadot noted, late pruning could help; one of their long-term growers in Bâtard-Montrachet pruned late and got a better crop, but the damage was still significant. David Duband reported how he also had issues in April with caterpillars which munched on the nascent buds. He had to hire five additional workers for a week to battle their hungry attack. The cold weather continued, with May cold and cloudy. Flowering at Bouchard began on 16th June, in wet and mild conditions that were perfect for oidium (powdery mildew) and downy mildew. Because the weather was so wet, mud prevented tractor access and at Bouchard they hired more people to spray by hand – a luxury not everyone could afford. Producers across the region spent their weekends during the summer spraying their vines when they could, with the disease pressure a particular challenge to anyone working organically or biodynamically. Edouard Confuron estimated he had sprayed four or five times more than in a normal year. There was some localised hail, with a storm in June causing damage in the north of Gevrey-Chambertin, especially in Les Champeaux, said Pierre Duroché and Olivier Bernstein.  
With the wet and cooler conditions, deleafing was important to open up the canopy, reducing disease pressure and exposing the fruit to much-needed sunshine. At Olivier Bernstein, Richard Séguin explained how they deleafed the fruiting zone and kept just one or two bunches per vine, removing any green bunches that remained at mid-véraison.  September saved the vintage, with warm, sunny and mostly dry conditions. With the tiny volumes, this was enough to ripen the fruit – Jacques Devauges at Domaine des Lambrays described it as Mother Nature evening the score, making up for what she’d taken in April.  Harvest dates varied quite significantly – starting from 10th September through to early October. Rain fell on 19th and 20th September, and producers were often divided between picking before and after this date. Generally producers started with Pinot Noir, then moved onto the Chardonnay, and dates were around a month later than in 2020. Jean-Marie Fourrier felt it was important to wait for phenolic maturity – which only arrived after the rain, and Erwan Faiveley argued that it was essential to wait for the dilution from the rain to pass before picking. Given the low yields, the harvest was often shorter – simply because there wasn’t much fruit.  Selection was essential – making a small crop even smaller – but there was some beautiful fruit of both colours. Yields varied, with losses between 50 and 80% – and some parcels (especially of Chardonnay) were blended together due to the tiny volumes at play. BURGUNDY 2021: THE WHITE WINES 
There’s no doubt amongst producers – or tasters – that this is an excellent vintage for Chardonnay. Production levels are laughable – with often the lowest yields they’ve ever seen, at a mere 20% of their normal crop – but the quality goes some small way to making up for the loss. The small crop (reduced by the harsh April frost) had a long season to slowly ripen, developing intense levels of concentration, yet – with cooler conditions than 2018, 2019 or 2020 – retaining amazing freshness and acidity. With the wet summer, disease was an issue: Erwan Faiveley described oidium as “exploding” on the Chardonnay (with levels not seen since 2004). Extensive sorting was essential. He also felt it was necessary to fine with bentonite after pressing to ensure the must was clean; similarly at Bouchard, Frédéric Weber didn’t use the very first free-run and inoculated fermentations this year to ensure they ran smoothly. Others, such as Philippe Abadie at Alvina Pernot and Paul Pernot, emphasised how important it was not to over-press. Most wines were chaptalised this year, often just to bring up 0.5%, with the final alcohol levels sitting between 12.5 and 13.5%.  Guillaume Boillot at Henri Boillot – who has produced a stunning range of wines – describes the whites as “salin”, having “belle matière”. Vibrant and pure, these are tightly wound with cool, white-fleshed fruit character, sometimes with tropical richness, often a mineral, saline thread and piercing acidity.  Due to the tiny volumes produced, oak usage varies this year. Boillot used none, but others have slightly more in the blend – feeling it didn’t need the freshness added by components aged in stainless steel. For Jadot, it was the first year that they used exclusively foudres, the larger barrels reducing the flavour impact of oak on the wine. Erwan Faiveley believes that tasting the whites, you can feel “the struggle in them”, that the vines suffered. Tasting through the exceptional Grands Crus he’s produced, however, it’s hard to see this – and perhaps he’s biased by the challenges of working the vines and crafting the wines in 2021. Comparisons are hard for such a unique year, but 2014 and 2017 were common themes, largely due to the high acidity, quality and ageing potential. Philippe Abadie and Alvina Pernot described it as “classic bourguignon”, while Thibault Gagey at Louis Jadot compared the year to 2011 or 2013, although feels the wines are better than those of the latter vintage. Faiveley points to 2007 – a vintage that has never shut down or, for him, disappointed; for Boillot they’re closest to 2016, but more precise. At Bouchard, Weber is so excited by their potential that he plans to keep them in barrel longer – possibly bottling in July 2023. These are really exciting wines – with a vibrancy and energy that is compelling. The cool and mineral classicism here, with great fruit concentration and balance, should age beautifully.

While there is a clear consensus on the 2021 whites, the reds are more varied in the vintage – but much better than we initially thought. The wines have clearly benefited from additional time in barrel, and most addresses have crafted a flight of elegant, pale-coloured and light-bodied Pinot Noirs. Although there are a few, rare examples of dilute or overly lean wines, this is in the main a return to “old school” Burgundy, with wines of perfume rather than power. The volumes are more generous than for the Chardonnay, but still measly, mostly sitting between 30 and 50% of a normal year’s yield. 
Frédéric Weber at Bouchard felt there were two styles of Pinot Noir in 2021: those from plots not damaged by frost, with normal yields but grapes with thin, fragile skins, prone to grey rot. The fruit from frost-hit sites, meanwhile, came with lower yields, thicker skins and less disease – for the latter he preferred to harvest later, with their higher tannin levels.  
Jean-Marie Fourrier noted that the picking date for Pinot Noir was key, worrying that anyone harvesting before the rain on 19th/20th was playing a risky game when it came to phenolic maturity and might have unripe tannins and vegetal notes.  
In general, Florence Heresztyn of Heresztyn-Mazzini felt it was a vintage, like 2012 or 2013, where producers needed to be attentive and precise at every stage – from the vineyard to winery. Sorting was essential and almost every producer chaptalised – largely used to prolong the alcohol fermentation rather than with the sole purpose of increasing the alcohol level. 

 Beyond this, tactics in the winery were varied – with vignerons often taking opposite approaches. Some producers, such as Bouchard, opted for more whole-bunch fermentation. Winemaker Frédéric Weber explained that the stems were so beautiful that he was happy to include 30-50% on average; the potassium also helped reduce the acidity of the wines, giving – he felt – a better expression of the year. 
The opposite was true of many, including Benoît Stehly at Georges Lignier and Hugues Pavelot. At Olivier Bernstein, the team used 30-40%, much less than in a warmer vintage, as they didn’t feel additional freshness was required, nor were the stems sufficiently lignified; similarly Heresztyn-Mazzini used 30-60% rather than 50-100% to avoid any greenness. While Jean-Marie Fourrier de-stems everything, in 2019 and 2020 he added the stems back into ferments for freshness, but didn’t feel it was necessary in 2021. 
When it came to extraction, the approach was similarly broad. Some felt it was a year to be more delicate, others thought it was a year that required more work to extract the colour and tannin that was in the grapes.  
Maxime Cheurlin at Domaine Georges Noëllat used a warmer – and therefore shorter – fermentation (sustaining 33-34˚C, versus 31˚C normally) to build the mid-palate of the wines. Charles van Canneyt had to buy smaller tanks for the miniscule yields, but the tiny tanks therefore fermented more quickly and he was careful to keep maceration short to avoid risking over-extraction. Similarly, Olivier Bernstein was keen to keep the fermentation short, with a five-day cold soak to extract colour and aromatics, then just 13 additional days on skins before the must was pressed – the fermentation finishing off the skins. 
By contrast, Fourrier opted for more extraction to get everything possible from the fruit. Guillaume Boillot echoed this view, with an additional week of skin contact. He used just pumping over rather than punching down to focus on fruit and aromatics rather than tannin; but at Faiveley, Erwan used more punching down than pumping over. 
Some producers highlighted that the grapes had high levels of malic acid (which has been notably low in recent, solar vintages), meaning that malolactic fermentation had a significant impact on the wines. Both Benoît Stehly and Charles van Canneyt noted how they were verging on severe at first, but after malolactic were open and fruity – totally changing in style. On paper, the pH is quite high for some wines (up to 3.7) – yet there is plenty of freshness, the lighter body and lower alcohol (mostly 13-13.5%) perhaps balancing it out.  
For élevage, some winemakers feel the wines need longer or shorter élevage, or different types of oak, with more or less new or different toasting. Nicolas Potel at Domaine and Maison Roche de Bellene feels that the crunchy character of the Pinot Noir will only be enhanced by a longer maturation in barrel (planning for 24 months versus the normal 12). Boillot opted for no new oak (as for his whites), feeling it would mark the fruit too much; while Maxime Cheurlin used less new oak but higher toast levels to add further complexity – and plans to bottle the wines earlier.  For Domaine Joblot, they felt that more new oak helped round out the lighter wines, using 50% new. At Domaine des Lambrays, Jacques Devauges favoured a slow, gentle toast – a "chauffe blonde" that gives the scent of freshly baked bread. Indeed, Devauges feels the wines have been improving significantly in barrel, offering more concentration and aromatics with each month that passes – something that reminds him of the 2010 vintage. 




Frédéric Weber at Bouchard describes 2021 as “charming”, comparing the wines to those of 2017, with good terroir definition and balance at 13-13.5% – more in line with what used to be “normal” for the region.  Thibault Gagey at Jadot pointed to 2004, 2013 or 2017 as possible similar vintages, but finds it hard to compare – it’s old school but approachable. Marion Raphet added 2014 into the mix, and although the wines are incredibly open now, wonders if they might shut down in bottle. For her, however, it is a year where, “On retrouve la typicité” (they rediscovered Burgundy’s typicity). The team at Tortochot pointed to 2011 or 2001, while Erwan Faiveley looked to 2007 and Florence Heresztyn noted the growing season was reminiscent of 2016.  
Maxime Chuerlin looks further back, feeling it has a similar equilibrium, colour and density to the outstanding 1991 vintage – in no doubt that the balance of the wines will allow them to age. While it’s easy to assume that these paler Burgundies might not be the longest-lived, almost every producer anticipates that 2021 will surprise everyone with its ageability – especially for the top wines. 
Almost every single grower we spoke to used a different approach for the 2021 vintage – but almost all have succeeded, producing vibrant, open and pretty Pinot Noir. It is a year in which careful vignerons could craft exceptional wines that were both light-bodied, yet persistent – with a purity and intensity that is surprising, along with captivating aromatics. As Nicole Lamarche said, “You can have both lightness and concentration.” It is, overall, a year that has surpassed expectations – one that was transformed by producers’ dedication, work in the vineyard, and modern technology and know-how in the winery.
