The beauty of Bordeaux wines is that each vintage follows the next, yet no two are ever alike. Reading back over my notes on the 2025 vintage, one thing becomes clear: one could almost write the exact opposite of 2024. In 2024, excessive rainfall during ripening forced some châteaux to delay their harvests with great care. In 2025, the situation was reversed: in the vineyards, one could almost imagine rain dances, pleading with Mother Nature to water the parched soils. Drought defines the vintage. Opposite in their development, the two vintages nevertheless converge on one point: volume. 2025 stands as the smallest vintage since 1991 – a statement that already applied to 2024. In Bordeaux, a pressing question now arises: can great, even very great vintages – as 2025 appears to be – still coexist with generous yields, as in 2016? Let us remain optimistic. 2025 is a beautiful vintage, which comes as a relief for the entire industry. Yet a deeper question lingers: does “normal” still exist in viticulture in an era of climate disruption? What was the biggest challenge for winegrowers in 2025? Eric Boissenot: Overall, the year was fairly easy from a vineyard perspective: no major disease pressure, low mildew risk, and the vines coped well with the drought—likely even better than in 2022. Thomas Duclos: Most likely, the biggest challenge was staying calm and level-headed towards the end of the growing cycle, which saw a heatwave around mid-August followed by rainfall in early September. Julien Viaud: With hindsight, this vintage was much easier than others. Spring and summer conditions were generally favourable. The greater challenge came in the cellar, where it was essential to manage the richness of the material. The fruit was abundant and concentrated, and the winemaker’s role was to be precise, measured, and restrained in order to express the very best the grapes had to offer. Could you share a few thoughts on the 2025 yields? Eric Boissenot: Yields were low, even very low. This was due, on the one hand, to limited floral initiation (resulting in fewer bunches), and on the other hand to small berry size at harvest (across all grape varieties), caused by the low rainfall throughout the vintage. Thomas Duclos: The 2025 vintage was affected by a low number of bunches—a direct consequence of the 2024 conditions (poor floral induction) combined with a dry growing season. The result is therefore low yields. Julien Viaud: Yields in 2025 were not high, mainly for physiological reasons. The issue is that both the size and number of bunches—determined the previous year within the buds—were limited from the outset. The potential was therefore already constrained. How would you describe the style of the 2025 vintage? Eric Boissenot: First of all, it is a very early vintage, shaped by a warm and dry climate. It then benefited from rainfall in late August and early September, which helped the vines manage water stress. As a result, alcohol levels remain moderate (around 13–13.5% vol) for a warm year. While it shows a warm and very ripe character, it also retains a classic, distinctly Bordeaux style that is both balanced and highly drinkable. Thomas Duclos: 2025 is a Bordeaux vintage shaped by climate change. Julien Viaud: It is a sunny vintage, but not “solar” in the sense that it allowed for ripe grapes full of fruit expression, without excessive sugar (and therefore alcohol), and without a loss of acidity (and thus freshness). It is an approachable, generous, and charming vintage, with wines bursting with aromas and delivering real pleasure. If you had to sum up 2025 in one word or a short phrase, what would you choose? Eric Boissenot: High density Thomas Duclos: Futuristic Julien Viaud: Intense and fast-paced Conclusions Reds: Well-balanced wines, showing fine concentration and the freshness so characteristic of Bordeaux—perhaps, as Julien Viaud suggests, a style the world might envy. They retain a solid yet never heavy tannic structure, resulting in wines that are both vibrant and structured. A beautiful vintage, even exceptional in certain cases. Whites: The first grapes arrived at the cellar as early as August 11. The wines are highly expressive, with good mid-palate weight and a certain creaminess. They also stand out for their freshness, which brings energy and lift. Sweet wines: When the rains came in late August / early September, the grapes were in excellent health, allowing Botrytis cinerea to develop evenly. The style is rather opulent, with lovely complexity. Bordeaux 2025 overview: A historically low-yield vintage, the smallest since 1991. A prolonged heatwave period, exceeding those of 2003 and 2022. Marked drought throughout the summer, enhancing grape concentration. Decisive rainfall at the end of August / beginning of September, helping to balance ripeness. Exceptionally early harvest, among the earliest ever recorded. Moderate alcohol levels, thanks to day/night temperature variation and late August / early September rainfall. Low pH levels, bringing freshness and tension to the wines. An extreme vintage in climate, yet precise and balanced in the glass. Rarity, freshness, and control: 2025 ticks all the boxes of a great modern Bordeaux. Overall, the 2024 crop was Bordeaux’s smallest since 1991 – with the region producing 332 million litres of wine. This is in part due to declining vineyard area, with the yield averaging 35hl/ha – slightly higher than that of the 2021, 2017 or 2013 vintages. Diving further into this, however, reveals a significant difference between the Left and Right Banks – with 34.4hl/ha in Saint-Emilion, Pomerol and Fronsac, versus 30.8hl/ha on average in the Médoc and Graves. It's a year where it is hard to generalise, even within each commune, for neighbouring estates produced drastically different results in the vintage. As David Suire of Ch. Laroque explained, there were such varying approaches to the year’s challenges, something that is echoed in the wines produced. RIGHT BANK This year, once again, the Right Bank offered more consistency than the Left. Although it was still heterogenous, the smaller size of estates lent itself to success – making it easier to treat and harvest in the narrow windows of dry weather. Wherever you were, however, it was a challenging year: as Christian Moueix said, “You cannot replace the sun.” Beyond the more overcast weather, hail hit Fronsac, Canon-Fronsac and Lalande-de-Pomerol in June, with some estates losing their entire crop, although Pomerol and Saint-Emilion largely escaped.  Pomerol For Noëmie Durantou (Ch. l’Eglise-Clinet), 2024 was a tough opponent – but one she knew they could win against, and looking back at it, what a game it was: as her wines certainly indicate. For her, there were several key elements to the growing season: the cloud cover that reduced diurnal variation (she recalls warm, sleepless nights), the late véraison, foggy mornings that increased botrytis pressure in the run-up to harvest, and the year’s humidity level – 80% in Pomerol, versus a more normal 50-60%. The hail that struck Lalande-de-Pomerol in June strayed a little into Pomerol, but most estates escaped any serious impact – with just a touch felt at Lafleur at Feytit-Clinet, for example. Treating the vines posed an additional challenge for the team at Clinet, who have to take into account the timetable of the neighbouring school, working around the presence of children and/or parents, on top of inclement conditions. Harvest began in Pomerol slightly earlier than in neighbouring Saint-Emilion, kicking off from as early as 16th September, but most starting to bring their Merlot in from 20th of the month, and the Cabernet finished by 4th October (although some producers had everything in the winery by the end of September). Yields varied significantly – from the second-smallest harvest since 1991 at Belle-Brise to the second-largest crop in the last 25 years at Lafleur.  Jeremy Chasseuil (Feytit-Clinet) emphasised how, for him, leaving the wine on lees for two months was key – helping to build texture, releasing polysaccharides that lend weight to the wine’s mid-palate. While 2024 did not produce the most opulent styles of Pomerol, the best retain a plush texture and exoticism to the aromatics that complements the naturally high acidity of the year. Although quality isn’t entirely consistent here, there are many highlights. Our favourites in Pomerol: Belle-Brise, Eglise-Clinet, Guillot Clauzel, La Conseillante, Lafleur, Le Pin, Vieux Château Certan Saint-Emilion There was a notable difference between Pomerol and Saint-Emilion – with Saint-Emilion seeing significantly more rain in April to June, with 278mm versus 199mm in Pomerol. Despite that, the region’s limestone plateau came into its own – allowing the water to drain away from the vines, despite hitting record levels (at Ausone, the level in their well was the highest-ever). August, however, was significantly drier on the Right Bank – with around half the normal rainfall.  Harvest started a little later here. Although some started as early as 17th September (Cheval Blanc, Canon, for example), most waited until 27th, and with several estates holding off until early October. Despite the year’s challenges (“It was a war,” said Cheval Blanc’s Pierre-Olivier Clouet), the yield across the appellation worked out as fairly average – although varied between estates. At Angélus, it was Hubert de Boüard de Laforest’s 40th vintage, and the bottle bears a cut-through of a tree-trunk with 40 rings as a tribute. At Ch. Beauséjour, it was the first vintage to be made in Joséphine Duffau-Lagarrosse’s new winery, something for which she was particularly appreciative, allowing her to divide the vineyard into smaller parcels and work with greater precision. Saint-Emilion is so large that there is inevitably a broad range of wines this year. Although there are some that can be overly tart, austere or astringent, there are some very impressive, textured, layered wines that retain tension yet also offer plentiful fruit and weight. Cheval Blanc, for example, is a very serious wine that will need time – a real contrast to many of the 2024s that are set to be approachable early. It’s worth highlighting Ch. Laroque, an estate that we have been watching for a while, and where David Suire continues to make wines that offer extraordinary value. Our favourites in Saint-Emilion: Ausone, Cheval Blanc, Clos de Sarpe, Figeac, L’If, Laroque, Tertre Roteboeuf LEFT BANK Yields on the Left Bank were – other than for the whites – generally lower than on the Right. It varies significantly between estates, however, with yields varying from the smallest-ever to normal. While there are years when lesser sites in the Médoc and Haut-Médoc excel, 2024 largely wasn’t – this was a vintage where the quality of terroir, as well as the means to make stringent selection were key. We found quality here was even more heterogenous than across the Gironde, however there are still some brilliant wines to be found.  Saint-Estèphe Quality in Saint-Estèphe is mixed in 2024. The commune’s cooler, northern position was not necessarily an advantage this year, nor were the more clay-rich soils – which have been such an advantage in recent warm and dry vintages. Estates with vines on free-draining gravels fared best, however there are many variables to the quality equation this year. While not every estate thrived, there are some serious highs here, with Montrose vying for wine of the vintage – offering a level of density and complexity that really stood out in our tastings. It’s the second rendition of their Grand Vin to come exclusively from Terrace Four (T4), a decision that is clearly being rewarded, and we also got our first taste of the not-yet-released wine made from T3, called “Terrasse 3” – a wine that will be worth looking out for. The team at Montrose emphasised how the appellation saw less rain between 1st August and 8th September compared to those further south, receiving just 50mm in this critical period (versus 80mm for Margaux and 120mm for Pessac-Léognan), something they felt was key to their success. Calon-Ségur was one of several estates that chose to abandon organics this year, using conventional sprays between budburst and flowering, before reverting to their normal regimen, allowing them to achieve the same yield as 2023 at 45hl/ha (versus 29hl/ha at Cos d’Estournel, who continued on their path to organic certification). Technical Director Vincent Millet – who is at the helm of Calon’s entire portfolio of estates, including Ch. le Prieuré in Saint-Emilion and Vray Croix de Gay in Pomerol – noted how the later-ripening Cabernet Sauvignon was particularly tricky this year, making the Left Bank more challenging than the Right in the vintage. Our favourites in Saint-Estèphe: Montrose Pauillac Pauillac had the lowest yield of any of the Left Bank communes this year, with the average across the appellation 29.5hl/ha (versus a 20-year average of 45.7hl/ha). Between estates, figures varied wildly – from the miniscule 11hl/ha made at Ch. Latour (a level more typical in Sauternes) to 33hl/ha at Ch. Lafite Rothschild, for example, looking at two estates working organically. June was drier here than elsewhere, meaning the vines started to suffer from hydric stress earlier – with some properties even saying they saw the vines’ development stall in August, with the first rains at the end of the month a welcome reprieve. Harvest here stretched through the first 10 days of October, with botrytis significantly impacting yields. Pichon Baron estimated they lost around 10hl/ha to rot – just one of the sacrifices that made 2024 such a costly vintage to produce. The resulting wines tend to have higher portions of Cabernet Sauvignon, and vary in both style and quality. Generally, these are lighter-styled Pauillacs, not having the firmness or power that this appellation can often offer. Although some don’t have sufficient concentration or structure, the best have trademark Pauillac graphite, complemented by more delicate florals, crunchy fruit, a saline quality and fine tannins. The vintage also marks 100 years of Batailley under the Borie-Castéja family, earning a commemorative label for this benchmark Claret, as well as a special Marie-Jeanne format. Our favourites in Pauillac: Batailley, Lafite Rothschild, Pichon Comtesse, Pontet-Canet Saint-Julien At Chx Léoville and Langoa Barton, Damien Barton Sartorius compared 2024 to running a marathon – tiring, but satisfying, and leaving you ready to sign up for another. The average yield for the appellation was a little bit higher than that of Pauillac, with 32.5hl/ha – still almost 25% down on the 30-year average. As with further north, however, the average is only an average: Beychevelle cropped at 43hl/ha, while selection took the yield down to 23.6hl/ha at Ducru-Beaucaillou (with the team throwing away almost 10hl/ha), and figures varied significantly between estates. At Beychevelle, Philippe Blanc explained how after just 4mm rain between 1st and 28th August, the rain recommenced and never stopped. Their Merlot was more impacted by mildew and therefore the blend is higher in Cabernet Sauvignon (55%) – something echoed elsewhere. The poor flowering and resulting coulure meant looser bunches, explained Barton Sartorius, something which he felt really helped them avoid significant botrytis pressure at the end of the season.  The smaller size of Saint-Julien means it is a little more consistent than Pauillac, however, it’s not entirely uniform. The fruit tends to be a little sweeter, while still on the red rather than black spectrum, the wines offering bright acidity and the best fine tannins and good balance, with the oak seamlessly integrated.  Our favourites in Saint-Julien: Ducru-Beaucaillou, Léoville Barton Margaux Although no appellation is consistent in 2024, Margaux produced some particularly impressive wines. Rainfall may have been higher here than further north, but the slightly warmer microclimate and shallow soils perhaps allowed the grapes to ripen earlier and more fully. There are still some light and tart wines, however the likes of Palmer, Margaux and Rauzan-Ségla produced wines that are among the best of the vintage. Ch. Margaux pointed to their early flowering as a significant advantage in the vintage – “a blessing”, in Aurélien Valance’s words. The 2024 vintage was meant to be the final year of organic conversion at Ch. Rauzan-Ségla, and as the mildew pressure hit, the team had a serious conversation about whether or not to persevere. With the owners’ endorsement, they decided that long-term it was the right decision to continue – knowing it would mean a sacrifice in yield (with a final crop of 30hl/ha), but it would also be their first organically certified wine. The Palmer team – long biodynamic – had to spray as many as 10 times by hand, unable to get their tractors into the vines. However you explain it, the results here speak for themselves – with wines that combine pretty, heady florals with sweet and supple fruit, as well as fine but persistent, powdered tannins: some serious wines that would deserve consideration in any vintage. This was also the one appellation where second wines – such as Alter Ego de Palmer and Pavillon Rouge – showed real quality. Our favourites in Margaux: Brane-Cantenac, Giscours, Palmer, Margaux, Rauzan-Ségla Graves + Pessac-Léognan Yields for the reds in Pessac-Léognan were – unusually for the year – average. The whites are discussed separately below, but the reds from Graves and Pessac-Léognan were as varied as elsewhere. There are, however, some charming wines, and some very impressive wines that defy the year’s reputation. This southerly region saw more rain in August, not benefitting perhaps from the hydric stress that was so key elsewhere – but the rain that month wasn’t excessive, just in line with the norm. At Smith Haut Lafitte, September saw more than three times the average rainfall (164mm versus 48mm), making the harvest far from easy. Although Carmes Haut-Brion picked 40hl/ha, they only vinified 24hl/ha – another example of the extreme selection that quality-focused estates put in place this year. Guillaume Pouthier – who always offers a unique perspective on a vintage – is doing something different with his ageing this year, reducing the temperature of the cellar from 16°C to 12°C over the two-year élevage, to preserve the fruit profile in the wine and encourage tartaric precipitation, thereby reducing the acidity level. Time will tell how this works, so it will be fascinating to retaste the wine in bottle. Domaine de Chevalier produced some particularly impressive wines this year, and although they have long worked organically and biodynamically, this year they made the difficult decision to use conventional treatments – something that has been rewarded, with both generous yields (48hl/ha) and very high quality. Our favourites in Graves + Pessac-Léognan: Les Carmes Haut-Brion, Domaine de Chevalier, La Mission Haut-Brion Dry whites Some people are raving about the dry whites in 2024 – and, while there are absolutely some brilliant whites, quality is far from uniform. The first Sauvignon Blanc grapes were harvested in Sauternes on 20th August, although most producers we spoke to picked from the very end of August/early September, with the last Semillon brought in on 23rd September. Yields were average to generous, with mildew much less of a problem – 30 hl/ha at Margaux, 32hl/ha at Smith Haut Lafitte, 38hl/ha for Haut-Brion and La Mission Haut-Brion, 48hl/ha at Domaine de Chevalier, for example, while on the Right Bank the Lafleur stable brought in around 40hl/ha and the Nicolas Thienpont team cropped 43hl/ha and 47hl/ha respectively at Alcée and Charmes-Godard. The cooler conditions preserved a backbone of acidity in the wines, with accordingly low pHs – analytically speaking, the wines have the highest acidity since 2014. The aromatics are precise, dominated by green rather than stone-fruit, and certainly not at the more tropical end of the spectrum. If anything, some of the wines can feel a little green or lean. As Smith Haut Lafitte’s Technical Director Fabien Teitgen explained, the challenge was to get ripeness that would cloak the acid of the vintage, the flesh to complement its skeleton. Owner Florence Cathiard feels the result is “one of [their] best whites”. Similarly at Ch. Margaux, they did a little more bâtonnage to give weight to Pavillon Blanc – and it’s one of the stars of the year. In some, you can feel the growing season’s excess of water – the generous yields resulting in wines that don’t have sufficient concentration. Sauvignon Blanc seemed to fare better than Semillon, which was more susceptible to rot and was more challenging to get phenolically ripe – and many of our favourites were pure Sauvignon, or heavily driven by the variety. Comparisons were varied – although 2021 was common for its acid backbone and cooler conditions. At Lafleur, Omri Ram is convinced that 2024 Les Champs Libres is one of their best, sitting comfortably alongside the 2023 and 2021. At Ch. Margaux, Aurélien Valance looked to a surprising vintage – the warm 2018 season, but in which the wine has a similar saline imprint to that found in 2024. Our favourites: Charmes-Godard, De Fieuzal Blanc, Domaine de Chevalier Blanc, Haut-Brion Blanc, Les Champs Libres and Grand Village Blanc, Pavillon Blanc du Ch. Margaux Sauternes + Barsac It’s easy to assume that because rain and rot threatened the crop in 2024, it was perfect for the sweet wines of Sauternes and Barsac: but very specific conditions are required for noble rot to set in, and if they aren’t met, you get grey rot – with both caused by the same fungus, botrytis cinerea. The first pass in Sauternes tended to take place at the end of September, with alternating wet and dry conditions encouraging the development of noble rot from the start of October. But teams had to battle grey and sour rot too – and a high degree of selection was key. At La Tour Blanche, they made just 3hl/ha for their Grand Vin, a tiny yield that matches that of 2021. The grapes that made it into the tank offered high acidity levels, precise aromatics, but not the luscious concentration of the very best vintages. Based on our tastings, the resulting wines are good to very good, if not quite exceptional, but may have particular appeal to consumers who prefer a lighter style of sweet wine – with brighter acidity and slightly lower residual sugar levels. They are vibrant and pure, with plenty of concentration, if not as hedonistic as more lauded years – and will be approachable at an earlier stage in life. The smallest event can set us on our path. A chance encounter, a favourite book narrated to us as a child, or a popular culture icon that we’re desperate to imitate. For Meghan Ireland, it was a double-page spread in a magazine. She might not remember who it was about, but the subject lit a fire in her that burns just as brightly many years later. “I was like wow, that’s what I want to do,” she says – eyes as wide as saucers – in the back room of the WhistlePig farm-cum-distillery in Vermont. The Whisky Advocate feature on a female Master Distiller showed the second-year Chemical Engineering student and “total chemistry nerd” a career she hadn’t previously considered open to her. “I got super determined after that,” she says. After cutting her teeth in a craft cider role, Ireland joined WhistlePig, or “the playground for distillation” as she describes it, which was under the inimitable stewardship of distilling icon Dave Pickerell. “He was just an amazing guy,” Ireland says. “Big personality and incredibly smart. He was always pushing innovation and experimentation and that’s something that has really stuck with this company.” Pickerell’s untimely passing in 2018 sent shockwaves across the industry, and many still talk about the role he played in the craft spirits revolution and subsequent rye whiskey revival. Many twittered about the fate of WhistlePig without the great man and his boundless creativity. This speculation only intensified after his successor’s short spell at the helm of the company. Today, Emily Harrison and Meghan Ireland head up distilling and blending at WhistlePig and, if their enthusiasm and first whiskeys are anything to go by, then those naysayers were very wide of the mark. “Dave gave us the ability to kind of run wild and create different experimentation options,” Ireland says. This creative energy is palpable in Ireland’s words and evident in everything the team has produced to date. “To this day my CEO asks me on a weekly basis, ‘What’s your new idea? What are we trying this week? What’s the new concept?’ He is always pushing, and he is always asking.” For some, this relentless pursuit might be draining, but it seems to have the opposite effect on Ireland. “To actually be able to explore and experiment with different options has been awesome.” Since its inception in 2015, WhistlePig has gone from a slightly obscure project to a formidable force on not only the American whiskey, but global whisk(e)y, stage. To get the brand off its feet, Pickerell and founder Raj Bhakta were very transparent about the fact they sourced whiskey from elsewhere in Canada. Today, the distillery is making strides in becoming a truly farm-to-bottle rye whiskey. “As much as we can, we want to produce a product that is ours fully,” Ireland says. “We are excited about releasing more and more of our own stuff to show off to the world what we can do here in Vermont.” The 500-acre former dairy farm is in a unique position – conceptionally and geographically. While the land may be fertile and the agricultural produce is verdant, the soil and water are both incredibly hard. As a consequence, the team has continually experimented, adapted and learned the best ways to use its triple terroir – grain, water and wood – to its advantage. “It makes who we are,” Ireland says. “You’re starting with very simple ingredients – rye and water. So, they are going to make up a big part of your flavour profile. I think terroir is huge in any distillation process.” Another huge part of the innovation at WhistlePig and the thing that really excites Ireland is the single finish programme. The Whiskey Blender has carte blanche to pick barrels and make one-off products. Part of her role, and one you sense she relishes, is finding the barrels. Ireland scours barrel libraries and leans on her contacts for anything new and exciting that appears on the market. There’s little she won’t try at least once. “I’m willing to put whiskey into anything,” Ireland says with those wide eyes. “I’m always looking for something different and unique. It’s fun to see when it’s going to hit that sweet spot between under-finished and over-finished.” She has been experimenting with Triple Sec and apricot brandy barrels, and a “couple of different wine finishes” are all maturing when we speak. The way the stills are designed (by Pickerell) allow for flexibility and are perfect for experimentation on both the front and back end. As with any experimentation, there have been some less successful outcomes. “I did a coffee barrel that was awful,” Ireland says, stifling a laugh. “It was bad. I was thinking like Irish Coffees and I thought it could work really well. People drink whiskey and coffee together anyways but that did not turn out good.” She hasn’t abandoned that idea just yet though. “I do think there are some adjustments that I could make and potentially still get a good product on that line of thought, but our first try was not there.” In terms of unicorns, Ireland says there are a couple of different Californian barrels she’d like to try and she’s trying to get her hands on a rosé barrel. “Not a lot of rosés are barrel-finished,” she says. “But I think that would be super interesting and a lot of fruity flavours would come into the whiskey potentially.” For the time being, the Whiskey Blender is experimenting with the many barrels she watches over. “I’m going out pretty regularly and pulling samples and trying to hit that point where I think we get the best flavour out of the different barrels. I’m getting to continue to push the boundaries of what we can put whiskey into.” One suspects it won’t be long before Ireland’s story inspires a whole new generation of chemistry nerds. Walking into the cooperage at Ch. Smith Haut Lafitte is like stepping back in time, filled with the smell of seasoned wood, an open fire and the same tools that barrel-makers have used for centuries. Few estates have the luxury of an in-house cooper. While producers inevitably work closely with the tonnelleries (barrel-making firms, such as François Frères, Stockinger and more), having an artisan on-site, working alongside the winemaking team to craft casks exclusively for your specific terroir is different. “It’s very important for the precision of the wine,” explains Cellar Master Yann Laudeho.  Florence and Daniel Cathiard, owners of the Pessac-Léognan estate, built a cooperage on-site almost 30 years ago, in 1995, and their current cooper, Yann Dez, has been working here since 2021. The Bordeaux native’s father was a metal worker, and Dez fell into the world of barrel-making entirely by accident – having a friend who was a tonnelier, and a job opening at an opportune moment. Before he knew it, Dez had learnt the trade from some of the best coopers in the country (including one who now makes the barrels at Ch. Margaux), and spending 15 years working under Didier Fesil. Fesil was the Cathiard family’s first cooper back in 1995, who went on to create his own small tonnellerie (Tonnellerie Bordelaise), and has been named the nation’s best “Master Cooper” – twice. Indeed, Fesil is still very involved with the estate, helping choose the wood for barrels and advising on all things oak; and it was Fesil who put Dez forward for the role at Smith Haut Lafitte.  “There are no books,” Dez says, when I ask about the art of barrel-making. “It’s passed on from tonnelier to tonnelier." The first evidence of coopering as a trade dates back to 900BC – with the craft passed down the generations ever since. “I continue the tradition,” Dez says, clearly with a sense of pride in this ancient, artisanal skill. But with the dust, noise and physical labour involved, tonnellerie schools, Dez tells me, are struggling to recruit young people. It’s common for coopers to have issues with their shoulders and ears (from the non-stop hammering) – and Dez himself has broken an elbow.  In theory, the process can be mechanised – but Dez is clear on how important it is to work by hand, and not just to preserve this ancient art. “I hear the nose, I feel the resistance,” he says. Each barrel, he explains, is different – with a slightly different number of staves and slightly different shape, all adapted according to the wood he’s working with. Selecting the right wood is key – “reading” it, he explains, looking at the grain to see where potential weaknesses are, understanding where will take the most pressure and placing each stave accordingly, ensuring not a drop can seep from the finished barrel. “It’s a job that is both physical, and at the same time requires thinking,” says Dez – and this combination is much of its allure for him.  Hearing the way Dez talks about barrels is fascinating; for him, they each have a unique personality. When I ask Dez how he knows he’s made a really good barrel, he shrugs: “On le sent.” (“You feel it.”) As you toast a barrel, he tells me, the scent of the smoke changes, releasing different aromas – something I smell as he works in front of me. Knowing when it’s spent the perfect amount of time over the fire is the secret – and it’s about more than just the smell, it’s a gut instinct that he can’t quite explain.  Smith Haut Lafitte sources oak from a range of forests, and are always trialling wood from different forests, toasts and doing blind tastings, although – after over 25 years – they know what works for their wine, and terroir. Cellar Master Laudeho explains that, for him, Tronçais and Jupilles are the best – “diamonds” that flawlessly complement their site. And that balance is key; the wood works for the wine, not the other way around.  It seems like a lonely job, I comment, hammering away in his tower – but it’s not something that bothers him. “I’m a bit of a perfectionist,” he tells me. Having only himself to depend on, and knowing that he can ensure each barrel meets his exacting standards, suits him. Indeed, he doesn’t even settle for standard tools – making most himself, custom-designed to suit the way he works. He talks me through a specific hammer that he made, and how it allows him to work better and more precisely, the wooden handle almost silken from the hours of use, shaped to his hand.   The lone electronic technology to have earned a place here are noise-cancelling headphones and a Marshall speaker. He’s a musician in his spare time, and an additional perk of working alone is that he gets to spend all day listening to music. “All the barrels I’ve made,” he says, “are made with music.” He avoids anything too modern or electronic, favouring old jazz, with some reggae, ska jazz and funk in the mix, depending on the day. While he doesn’t feel the music he listens to influences his coopering, he suspects his mood does – and music is a big part of that.  Woodwork is much more than a job for Dez. I spy a beautiful chest alongside his speaker, and it’s one that he made. He has a workshop at home too, spending his free time making everything from guitar stands and toys to chandeliers – anything, he says, that isn’t straight, and therefore can’t really be done by a machine.  It’s amazing watching him work – in the same way as coopers have for centuries – with a natural intuition, ease and precision. There’s definitely something musical to it, a craft that has its own rhythm. He makes around 300 barrels a year, and they may not be soloists – but each one contributes their own note to that year’s symphony.  Explore all current listings of Ch. The vines are organically-farmed on a 15-hectare estate planted on white marl in the hamlet of Quintaine, just north of Clessé. Jean Thevenet and his son Gautier take their time producing their wines and retain traditional methods passed down from generation to generation. Ever since taking over the family estate in 1972 Jean has never been one to follow trends – keeping yields low (between 35-45 hectoliters per hectare) and picking purely on taste rather than relying on any data analytics from the lab. They have never been afraid to pick later than their peers due to their wines' amazing ability to retain acidity and freshness thanks to their unique marl blanche soils.  Even in a warmer vintage like 2015, Gautier says “you don’t feel the heat, the marl soil always providing a bitterness that offsets the fruit. If anything in 2015 the heat of the vintage has only brought a really incredible structure to the wine.” On tasting, its true – the wine is incredibly rich and fresh and finishes with a wonderful mineral salinity. For now, Gautier has not felt the bad effects of climate change, currently the warmer vintages are just bringing more complexity, structure and richness to the wines. For the 2015s, Gautier picked the grapes on the 17th September, which he states is not that much later than others in the region and perhaps just a week earlier than normal. Over the years he has learnt to trust in his terroir and even with such low yields (three times lower than the limits of the appellation) he needs to give the grapes time to reach optimum ripeness. The art of élevage Using no tricks to speed up the process, the wine ferments at a snail's pace under wild yeasts, producing a unique viscous-like texture and thanks to its distinct marl blanche soils a vibrant minerality and laser-like acidity. Grapes are left to hang on the vines until they are ultraripe. The grapes are then gently squeezed in a Coquard press until every ounce of flavour and all the intensely honeyed aromatics have been harvested. The wines undergo ultra-long fermentation and aged on the fine lees, and held back in the cellars at the domaine's expense, only being released when they are deemed ready to drink. These wines have amazing ageing ability too. Just recently William Kelley (Wine Advocate) talked about how the 1989 Viré-Clessé is drinking at its peak now at 30 years of age. Henri Jayer once said that a winemaker needs a chair. Less intervention, more reflection. This is somewhat mirrored in Jean Thevenet’s motto: “Terroir is to wine what a composer is to music. The winemaker being only the conductor.” In the cellars of Domaine de la Bongran intervention is minimal, with fermentations sometimes taking up to two years. Appellation controversy Despite Domaine de la Bongran being the most respected and appraised wine in the region, at the outset of the newly declared Viré-Clessé appellation in 1999, the wines of Domaine de la Bongran failed to qualify. The excuse from the IANO (administrative body) was that the levels of residual sugar were not considered “suitable” expressions of the region. Under these  new appellation rules the wines had to have a residual sugar level lower than 2g/litre, forcing Domaine de la Bongran to declassify down to Macon Villages. Following the extreme temperatures in 2003 all producers in the region produced wines with residual sugar over 2g/litre and therefore collaboratively put pressure on the IANO to increase the allowance up to 4g/litre allowing Bongran’s Viré-Clessé to qualify under the more premium Vire Clesse Appellation. For a body whose aim is to protect quality, specifically against over-cropping, the initial decision to omit the wines of Domaine de la Bongran seemed extraordinary, although it's fair to say the reputation of the winery precedes the appellation and if anything their inclusion has only elevated the status of the appellation. The wines The Viré-Clessé, also known as Cuvée Tradition, is the principal wine made at the estate, offering rich complexity, freshness and power with finesse. The wine is easily a match for the best of Puligny or Chassagne-Montrachet, they are examples of the heights that can be achieved with traditional winemaking methods. The Cuvée Levrouté (or Levroutee) is their off-dry wine typically around 18g/litre of residual sugar, only made in exceptional years, from part botrytised Chardonnay grapes, adding honey and truffle to the flavour profile. Cuvée Botrytis is a stunning rich sweet wine, coming from principally fully botrytised grapes. The conditions necessary to make this wine is are exceptionally rare, the last vintage being 2006. What the critics are saying: "..one of Burgundy’s greatest winemakers… served blind, tasters tend to think they are Grand Cru white Burgundies from Puligny- or Chassagne-Montrachet." Behind the bottle: Vire Clesse by Domaine de la Bongran

Wine journalists are jaded folk – spoilt by too many impressive tastings, lunches and dinners. But when Champagne Louis Roederer invites you to an event celebrating 50 years of Cristal Rosé, few refuse. Cristal Rosé is, as Chef de Cave Jean-Baptiste Lécaillon told us, still “a hidden gem” and the rarest cuvée Roederer produces. It’s not often shown, and even visitors to the estate don’t get to taste the wine.  While Cristal – Champagne’s first prestige cuvée – was created in 1876, its pink sibling was born almost a century later. It was Jean-Claude Rouzaud, current CEO Frédéric Rouzaud’s father, who created the wine, aged 32. He had been managing the company’s vineyards and took over the winemaking in 1974.  “His great vision was to put the vines back in the centre of the creative process,” explains seventh-generation Frédéric Rouzaud. For Roederer, site and farming have long been key to what they do (long operating both as a grower and négociant), but Jean-Claude’s move from vineyard to cellar pushed this further, allowing for – as Lécaillon put it – “a creative and constant dialogue between the vineyard and cellar”.  The same year that he started leading the cellar team, Jean-Claude decided to make a rosé version of Cristal. Almost all rosé Champagne was – and is – made by blending a still red wine in with the base white wines. Jean-Claude, however, wanted to use co-fermentation to keep the wine in the style of Cristal, a decision that Lécaillon says was key, making the wine more ethereal, precise and “Pinot-y”, with a juicier texture.  The wine was built around parcels of Pinot Noir in the Bonottes area of Aÿ, which Lécaillon describes as the “Musigny” of Champagne. In his mind, the Pinot Noir from these plots offers a “special tannic complexity” – tannins that are more saline, integrated and aromatic; the Pinot Noir here is, he says, “effortlessly perfect” and the heart of Cristal Rosé. These three vineyards (Bonotte Pierre Robert, Gargeotte and Côte du Moulin) had been used for Cristal since the 1870s, and more recently became the source for Pinot Noir material for their vine nursery – with 150 different massal selections taken from the plots – long recognised for their quality.  The three original Pinot Noir plots are now being replanted and – while the vines mature – another site in Aÿ, La Villers, a mid-slope parcel at higher altitude, is currently being used in the blend (from the 2018 vintage). It is set to form part of the wine long-term, its cooler position thought to be of particular benefit with climate change. Complementing the 55% Pinot Noir is Chardonnay from two sites – Pierre Vaudon in Avize (bringing more power and richness) and Montmartin in Le Mesnil (lending length, salinity and a chalky minerality).  The first two vintages (1974 and 1975) were more experimental, as Jean-Claude figured the wine and style out, but the third attempt in 1976 produced something special – with sufficient phenolic ripeness to produce a rosé truly worthy of the Cristal name. Even now, 48 years later, that wine is singing – combining savoury rye and brown miso notes with pear tarte tatin and an earthy power. While it had a flurry of three vintages at the start of its life, just 25 vintages of Cristal Rosé have been produced to date. The wine needs a year where not only the quality of fruit is outstanding, but the Pinot Noir and Chardonnay ripen at the same time – allowing for their co-fermentation – something that is relatively rare.  Only made with vines that are minimum 20 years old, yields are low for Champagne (at 35-40hl/ha).  The Pinot Noir is destemmed, crushed and left to macerate. Earlier vintages saw this happen over two to four days and at warmer temperatures, but the winemaking has evolved over the years, with a pivotal shift from the 2008 vintage. From 2008. Lécaillon started chilling the Pinot Noir down to -4̊C overnight, prior to de-stemming and crushing the fruit – something which he believes avoids extracting any green character.   The must is then left to cold-soak for between seven and 10 days, with no punch-downs or pump-overs – a true “infusion” (to avoid any microbial spoilage, they cover it with dry ice for the first four days, then use nitrogen). The must isn’t chilled during this time, and the temperature gradually rises to a maximum 8-9̊C. Moving to a cold-soak was inspired by an accident. In the warm 1989 vintage, Lécaillon’s first year at Roederer, they didn’t have a cooling system in the cellar, and the Pinot Noir was left in a reefer – undergoing an inadvertent cold-soak. The resulting wine was so good that it inspired Lécaillon.  Just as the fermentation starts, the must is racked off and blended with the Chardonnay which has been whole-bunch pressed pneumatically (Lécaillon argues the grape’s reductive nature needs a little skin contact to avoid being overly thiol-driven and Sauvignon-esque). Around 20% of the base wine sees oak. After secondary fermentation (under crown cap, something with Lécaillon argues helps preserve precision and terroir versus cork), the wine spends eight years on its lees, developing immense complexity.  “Since 1974, it has been our laboratory of farming, of winemaking,” says Jean-Baptise Lécaillon of the wine. Cristal Rosé was in fact the House’s first cuvée to be farmed biodynamically, and the first biodynamic prestige cuvée in Champagne, from the 2007 vintage. He explains that he is looking for phenolic ripeness, integrated with the salinity of Champagne, seamlessly combining the tannins and acidity; a wine complemented – but not dominated – by bubbles of salt.  The wine is undeniably remarkable. Tasting through a range of vintages from 1976 to the present day, all in magnum (find full tasting notes below), the vibrancy, purity and moreish, saline, minerality of these wines left me speechless. Their ability to age is effortless, with the 1989, for example, still tasting incredibly youthful. Talking about Cristal Rosé’s evolution, Lécaillon explains that he finds the first decade is all about fruit, but then the wines return to their site and soil, becoming wines of place. Conversation strays into weather Champagne today, with global warming, can still make wines that will age as beautifully.  “Champagne is not just about acid; it’s about freshness,” says Lécaillon. He points to the 1976 and 1989 vintages – both incredibly hot years, with the fruit picked at almost 12% potential alcohol and modest acidity levels – and yet the wines are full of freshness. Back then, producers were on holiday throughout August, and the fruit was picked in September (1st for the 1976 and from 5th for the 1989), but with such conditions today they would have harvested in mid-August. It is perhaps, he suggests, a lesson that the region is overreacting to warm conditions – with too many producers chasing acidity, rather than phenolic ripeness. For the skins are, he argues, the key to this sense of freshness, the dry extract that allows the wine to age.   The House has introduced a Cristal Rosé Vinothèque, or late release. To date, there have only been a handful of vintages – the 1995, 1996, 1999 and 2002. The maturation for this wine isn’t set and varies according to the vintage, normally spending longer on its lees, both sur latte (lying down) and sur pointe (upside down), the idea being to build umami complexity in the wine. The sur pointe ageing is unusual, something Lécaillon favours for its more reductive nature, keeping the wine aromatically fresh (the wine is still riddled four times a year in the same position, to agitate the lees and absorb any oxygen). Generally these releases are offered around 15-17 years after the vintage. The dosage is often lower than the original bottling, with the longer lees ageing lending balance without a higher sugar addition. Tasting the 2002 Vinothèque (a wine that feels infantile), Lécaillon says: “Is it better? I don’t know, but it’s another expression.”  I’ve written before about Lécaillon’s tireless approach to wine-growing – constantly looking to learn and evolve, and the week after our dive into Cristal Rosé he was flying to Japan to visit the Fukuoka farm (founded by Masanobu Fukuoka, the author of The One-Straw Revolution and a pioneer of permaculture or “natural” farming). His fight against the “banalisation” of taste continues, as he looks for ever-more ways to enrich the world of Louis Roederer. If the next 50 years of Cristal Rosé is nearly as good as the first, we’ve all got a lot to look forward to.  Five decades of Cristal Rosé: the tasting  2013 Cristal Rosé: A beautiful, late-ripening growing season that provided the last October harvest to date. A wine Chef de Cave Jean-Baptise Lécaillon describes as having “eternal youth” – something that is hard to disagree with after tasting the wine. This is a baby, the nose enticing with delicate floral aromas and bright citrus, not giving too much away. The palate is long and saline, tightly wound, but bursting with bright fruit on the mouthwatering finish, combining lush redcurrant and lemon. Gorgeous. Dosage 7g/l, tasted from magnum.  2012 Cristal Rosé: Lécaillon notes how 2012 was seen as an “easy” vintage on release, riper and richer with a little more Pinot Noir in the blend, but is now entering its second life, with reductive, chalky notes that bring it back to its soils. The wine is beautifully earthy and drastically different to the 2013, with power and intensity. It’s very savoury, a wine that is all about breadth and structure, with wild strawberry and raspberry notes mingling alongside a sea-spray freshness, driving on to a long, mineral finish. Dosage 8g/l, tasted from magnum.  2008 Cristal Rosé: This was the first fully organic vintage for the entire Roederer estate, and marks the start of a new era for Cristal Rosé with its cool “infusion” technique for the Pinot Noir. Paired with the 1995 vintage, the two wines are windows into two completely different worlds of Cristal. With the copper tone of a sunset, it’s a wine of muscle. It’s almost haughty, with length, power and elegance – showing off its flawless structure, with a zesty citrus drive complementing its austerity. The finish is long and saline. It will be incredible to taste this in 20 years’ time. Dosage 8g/l, tasted from magnum.  1995 Cristal Rosé: This vintage was one of the last to see the Pinot Noir soaked at 20-24̊C. It is, in Lécaillon’s mind, the “same terroir, but a different story” versus more modern iterations of the wine. The wine glows golden in the glass – the colour of the sun just as it breaks the horizon. It’s incredibly open, the aromatics constantly shifting to reveal new layers. There’s a touch of mushroom or truffle, but with layers of rich, almost tropical, fruit behind – think peach, mango, peach tea and the bite of pomegranate, with caramel sweetness, but still a saline twist to the finish. A wine of weight and depth. Dosage 12g/l, tasted from magnum.  1989 Cristal Rosé: This was a very warm vintage, harvested from 5th September, and the wine technically doesn’t have high acidity – yet is a wine of impressive freshness. Grilled hazelnuts edge a nose of candied orange peel and pomegranate, and a coffee note that emerges with air. There’s a liveliness to the palate here, even over three decades on, with a gorgeous freshness and creaminess to the mousse. The fruit on the palate is lush, with generous mouth-watering peach and a taut, mineral backbone. It’s amazing how young this tastes still. Dosage 12g/l, tasted from magnum.  1976 Cristal Rosé: Despite coming from another warm vintage (with a very hot, dry August – and harvested from 1st September), Jean-Baptiste Lécaillon notes the freshness on the 1976 vintage, and how it seems to have never become too evolved. It’s much more savoury than the 1976, with rye bread and brown miso sitting alongside caramelised pears, tarte tatin and a hint of Oloroso Sherry. The palate is a rush of fine bubbles, fresh and with a citrus bite but a savoury framework behind. A remarkable wine. Dosage 10g/l, tasted from magnum.  2002 Cristal Rosé Vinothèque: This was disgorged in 2019, spending 11 years on lees sur latte, and then another five sur pointe, followed by an additional four years’ post-disgorgement ageing prior to release. This wine is so tightly coiled, a wine not yet revealing everything it has to offer – although you can see the incredible structure. It’s so vibrant, with energy and a lushness as it drives toward a seemingly never-ending finish. It’s gorgeous, layered with mandarin, grapefruit pith, chalky minerality and smoked salt, lingering on the soft, saline tail of the mouthwatering finish. Wines sold en primeur will be released from the producer after bottling, typically 18 months after the so-called campaign ends. Upon arrival your wine will be stored at Vinfolio in our temperature-controlled warehouse until you decide to take delivery.

We will source this item at the guaranteed price from our network of suppliers and arrange expedited shipment to FINE+RARE.
 The lead-time depends on many variables, but 2-4 weeks is typical for expedited sourcing.
