What defines a fine wine? For many, it is a bottle’s ability to improve with age. A wine’s longevity is even seen, by some, as the ultimate measure of its quality. It’s true that aged wine can be some of the most memorable – capturing an essence of time that’s impossible to recreate. The ageing process can be central to a wine’s (or, for that matter, whisky’s) progression to another, unparalleled level of complexity. Yet how a wine ages remains something of a mystery to both winemakers and collectors. There is still a great deal of conjecture about how a wine will develop, why it does so, and whether it is even worth the wait. Unlike whisky, wine is much less stable on its journey into maturity. As Christian Moueix puts it, “Wine is a complex matrix of thousands of compounds suspended in a delicate equilibrium.” This equilibrium is fragile, age a potential threat and a wine’s trajectory therefore incredibly difficult to predict. There was a time when wine drinkers dismissed the New World. Today, fortunately, that’s not the case – and it’s rightfully acknowledged for producing fine wine. However, some snobbery remains. Drinkers tend – beyond a handful of the very top names – to drink New World wines much younger than their Old World counterparts. Ask any oenophile about the oldest bottle they’ve drunk, and we’d put money on it being from Europe – Bordeaux, Burgundy, the Mosel, Alsace or Douro. Of course, one element is undoubtedly availability. The traditions of drinking Bordeaux (even from modest châteaux), for example, at full maturity – 20 or 30 years down the line – is not uncommon, and these wines continue to be regularly traded among collectors. New World wines at full maturity are much more of a rarity. Many of the younger regions in the New World still haven’t had the chance to build up such an extensive back catalogue, yet the wines have everything they need to comfortably age as long as their counterparts. Burgundy maestro Jean-Marie Fourrier, who now also manages Mornington Peninsula winery Bass Phillip in Australia, is an advocate for New World wines’ ageability, with Bass Phillip’s Pinot Noirs a case in point. But he believes the reputation for a shorter drinking window is partly due to practical, economic necessity. “When you start making wine at a young winery, you need a quick turn over, a quick return on investment,” he says. Therefore, producers craft wines that can be drunk younger. It is only once a winery, or a region, is established that winemakers can afford to have a longer-term approach and deliberately make wines to age or hold back stock. In this respect, the established classical regions of Europe have hundreds of years of history to fall back on. Napa has long since proved its mettle producing wines that can age. But just what it is that allows a wine to improve with age has been a hot topic of conversation in the region for decades. Tor Kenward – of Tor Wines – recollects a conversation between himself, Robert Mondavi and another legendary Napa winemaker, André Tchelistcheff over 40 years ago. Sitting around a table, they were trying to determine the key factor that makes great wine age. Was it the winemaking? The quality or concentration of the grapes? Or was it all about harvesting at the right time? Tchelistcheff – who trained in Europe and, by this time, had been making wine in Napa for over four decades – contemplated the suggestions. High acid levels (low pH), high concentration of tannins and oxygen management were all tabled and, while he accepted all were important, for him, a great wine for ageing needed “flesh”. By this, recalls Kenward, he meant the grapes needed a certain type of ripeness – not over, not under, but perfect physiological ripeness. Forty years on and Kenward still believes Tchelistcheff was right, yet it is an aspect often forgotten in the discussion of a wine’s ability to age. Finding this perfect window of physiological ripeness can be a challenge in warmer regions, and a warming climate, and therefore remains an obstacle for much of the New World. These regions tend to be warmer than historically marginal wine-growing regions of Europe, and therefore grapes can ripen quickly, but with this fast ripening comes a risk of reaching sugar ripeness before the skins have had the necessary time to reach maturity. Christian Moueix is one of the world’s most experienced winemakers, having managed both Pétrus, Trotanoy and other top Pomerol estates, as well as Napa’s Dominus. He agrees with Tchelistcheff that picking the grapes at optimum ripeness is a hugely important factor when producing wines that can age. “If harvested too early, grapes have a smaller quantity of extractible phenolic compounds and […] may not have formed the longer chains and bonds that make them stable.” On the other hand, when overripe, “These phenolic compounds are degraded through oxidation.” For Moueix, the temperate climates in Europe are ideal for “developing and maintaining a high ratio of phenolic compounds”, whereas in many New World regions, there is a propensity for excessive heat, over-ripeness and therefore oxidative winemaking which he feels is, “likely to contribute to wines that age prematurely”. In warmer climates, Moueix believes, “extreme heat, enzymatic and physiochemical reactions degrade anthocyanins within the berry, lowering the concentration of total phenolic compounds and subsequently, the wine’s capacity to resist oxidation, leading to premature aging”. For Moueix, then, a temperate climate (whether in the New or Old World) is key to producing wines that can age. It is, he believes, the reason why Dominus ages so well. This corner of the southern Napa Valley is relatively mild, thanks to the San Pablo Bay’s cooling influence. This slows sugar accumulation and gives the berries time for the tannins to ripen. They also don’t use irrigation, putting the vines under more stress, producing small berries with high phenolic concentration. Like Moueix and Tchelistcheff, Fourrier believes picking dates and high concentration of tannins is important – but he ties this to vine age, rather than the microclimate. “As vines get older, the size of the berries gets smaller,” explains Fourrier. It is this that gives a high skin-to-juice ratio and natural concentration. For Fourrier, this natural concentration is what gives ageing potential – rather than any actions in the winery. All are in agreement that the ageing ability of red wines comes down to the quality of the berries, rich in anthocyanins (ideally then from older vines) and picked at the right time in order to extract them at their optimal level of ripeness. But these factors affect Old World producers as much as those in the New World. Paul Roberts – Master Sommelier and COO of Colgin in Napa – makes a compelling point that New World regions in the right climate regularly produce higher concentrations of tannins than the Old World’s cooler climates. In fact, they have to pay close attention to extract less tannin during the winemaking, not more, to maintain the balance in the wine for it to age. Colgin’s mountainside IX Estate vineyard on Pritchard Hill produces berries that are, on average, 30% smaller than those grown in Pauillac. Often, Roberts notes, Napa Cabernets have higher skin-to-juice ratios than the Bordeaux First Growths – and therefore much more “anti-oxidant” tannins than their Bordeaux counterparts. According to Moueix’s belief that it is the concentration of tannins and phenolics found in the skins that protects wine from oxidation and degradation, this should mean that top Napa wines have the potential to outlive Bordeaux wines at the top level. Andy Smith, winemaker at the Russian River’s DuMOL estate, makes some of the region’s top Pinot Noir and, like Colgin, has no shortage of tannins in his grapes. Compared to Burgundy, his Pinot Noir has smaller berries, “with uncommonly thick skins that create huge natural power if you choose to extract fully”. For Smith, “this leads to a potential for powerful, deep wines with high structure for aging, and high natural acidity”. Like Colgin, it is an overabundance of tannins that is more of a concern at DuMOL. “The key is balancing the extraction,” says Smith, “to take the positive and leave behind the excessive elements from the skins.” For leading Chilean winemaker Francisco Baettig (Errazuriz, Seña and Chadwick) it is an excess of tannin, and an excess of extraction in some more ambitious wines, in the New World that has tainted its reputation for producing wines with long ageing ability. “There was an obsession for creating monster wines, with lots of extraction, trying to extract as much tannin as possible,” Baettig notes, looking back 10-15 years. Many producers in Bordeaux were doing the same at the time, but the different climates – the same elements highlighted by Roberts and Moueix for leading to higher concentrations of tannin – influence the tannin and extraction. “In Chile with higher intensity and higher levels of ripeness, the extraction happens much quicker,” he explains. This resulted in over-extraction – “wines that were rough, too tannic and did not age well”. For New World producers, better tannin management is clearly key to producing wines that can age. Producers like Tor, Colgin, DuMOL and Baettig all believe gentle extraction of tannin and reducing the wines’ contact with oxygen is fundamental for ageing. In cooler, less sunny European climates, it could be argued that in the past, due to the less easily extracted tannins, producers could get a way with being a lot less precise in their tannin management. With this in mind, Baettig notes the Old World might need to learn from the New World, how best to adapt their winemaking to the effects of climate change – and, in many ways, they already are. Vignerons are already looking back at sunny vintages such as 2005 and 2010 (with high levels of extractable tannins) and questioned some producers’ apparent over-extraction of tannins, adapting accordingly in years like 2019 and ’20. The transformation of grapes into wine is magical; the secondary transformation that can take place with maturity is possibly even more extraordinary. However, a wine with so much promise can disappoint if left too long – a frail, bitter example of its former self. It is no surprise that many drinkers choose to avoid such risks and savour wines in their more muscular youth. There is a cultural change too. DuMOL’s Smith notes that the average US consumer is not particularly interested in ageing their Pinot Noir and questions whether ageing wine is an outdated notion. In a society that favours immediate gratification, modern consumers are impatient and few have cellars in their homes. And the savoury flavours that come with maturity aren’t to everyone’s tastes. “There’s a big difference between positive evolution, plateau-ing and the gradual downward slope of oxidation,” he says. “All wine ultimately wants to become vinegar!” Because of this, some winemakers are deliberately pulling back from making wines that peak at 20 years, instead looking to produce wines that will appeal in youth and peak closer to 10 years, since that’s what their customers want. Even the most tannic red wines from the more traditional regions are these days much more approachable in their youth, something that just wasn’t possible just a few years ago (as noted by Lisa Perrotti-Brown MW). Making fine wine is an art – and especially so when it comes to building a wine for the future. Choosing the perfect moment to pick in the given climate, as well as the right style and level of extraction in the winery will determine a wine’s ageability – but only if the underlying quality of fruit is sufficiently high. With better winemaking equipment, we no longer need to wait for tannins to soften to enjoy even the best Bordeaux or Napa. Does that mean you can’t age it for a half-century? Or that it won’t improve over that period? Absolutely not. How to make wine for the ages

Chris Phelps never really meant to start his own winery. But fate had other plans.  Wine had always been part of life, just in the background. Growing up in Livermore, east of San Francisco, Phelps’s parents would buy a ton of grapes from Napa or Sonoma, and make wine each year for themselves. Phelps even dug out a cellar by hand for them as a teenager. Nevertheless, when he set off for UC Davis, it wasn’t to study wine, but medicine. To pay for university, he took a job as a firefighter in Idaho (“kind of scary but super fun,” he tells me). By chance, he met a wine-geek friend, one who eventually convinced him to switch from pre-med to oenology. At Davis, he happened upon Alain Bertrand – one of the first scientists to use gas chromatography to delineate the different aromatic compounds in wine. The Frenchman didn’t speak much English, and Phelps spoke French – so they ended up becoming friends. Bertrand suggested Phelps attend the University of Bordeaux for a year after graduation. There, Phelps tells me, everything “started to fall into place”. Until then, wine had been intellectually interesting – but, during his time in France, it became much more.   There, another professor pushed him to apply for an internship – just in time for the 1982 harvest, a vintage that would turn out to be legendary. He already had offers from both Ch. Simon (Barsac) and Ch. Beauregard, but then was given the opportunity to interview with JP Moueix (of Pétrus). Unusually Christian Moueix insisted on joining the interview himself, alongside winemaker Jean-Claude Berrouet, and promptly gave him the job. The confident young American, however, said he’d think about it – and set off for a holiday in the south of France with his fiancée. Little did he know that Moueix had just bought a swathe of vineyard in Napa – and was planning for the future.  A few weeks later, Phelps was in Nice and bought three postcards from the Chagall museum – ready to make his decision about the three possible roads that lay ahead of him. He decided to take the position at Moueix, posted his rejections and acceptance, and carried on with his holiday. But, as harvest time approached, Phelps hadn’t heard anything back. He called Berrouet – only to find out that the French postal service had let him down, and the job at Pétrus had been given to someone else. It seemed like his luck had run out, but Berrouet said he might have another idea and would call him back in a few days.   While Berrouet couldn’t offer him anything as prestigious as Pétrus, he found Phelps a job at Ch. des Laurets in Puisseguin-Saint-Emilion – but he wouldn’t just be an intern, he’d be running everything. It was, Phelps said, a “trial by fire”, especially given his only hands-on experience to date had been six months at Louis Martini. He worked non-stop with just one cellar hand to help during the day, and managed to make it through the season.   When the wines were safely in barrel, he went to dinner at Christian Moueix’s house – where, sipping Champagne in the library, Moueix told Phelps about his plans for his Napa project, Dominus – and asked if he’d be the winemaker. “Of course, I said no,” Phelps tells me – recalling how the Frenchman opposite visibly sputtered at the American’s cheek (again). Phelps said he needed more money to live in Napa (and support his bride-to-be) – and more experience. Amazingly, Moueix agreed to let him start from 1984, given the 1983 vintage was set to be just a handful of experimental barrels, and to a pay rise. Off Phelps went, working around California and wintering at Pétrus before returning to lead the team at Dominus.   “We figured it out as we went along,” Phelps says, looking back on the early days of what is now one of Napa’s most prestigious estates. Today they might have the iconic Herzog & De Meuron winery, but things were much more rustic at the beginning – with a small team and little infrastructure. Phelps eventually moved on, joining Caymus in 1996 – but it’s what started happening after-hours, around his day job, that is interesting.  In 1990, Phelps met Larry Bettinelli at a Christian men’s retreat, and hit it off. It was only when they met up for lunch later that they realised they were both in the wine business, with Bettinelli a fifth-generation farmer who was growing grapes. Bettinelli wanted his vineyards to be the best in the valley – but he needed feedback on the fruit so that he could adapt his viticulture. He and Phelps hatched a plan: each year, Bettinelli would give Phelps a ton of fruit, trialling different clones, rootstocks, vine spacing and trellising, harvest methods, and Phelps would make a wine with it. The project was purely intellectual, so the two families drunk the wine themselves, and it also started being used as the altar wine at Phelps’s church (a much higher-grade communion offering than most). For two decades, they kept making tiny batches of their first-class “homebrew”, and Bettinelli became one of the valley’s best growers, working with an increasing number of sites around Napa.  Destiny seemed to abandon all subtlety in 2005. Phelps was hiking through the Sierra Nevada, leading a Scouts expedition, when they were struck by lightning. Two of the group died and Phelps was knocked unconscious. Unsurprisingly, it shook Phelps to the core. “Life is our most precious gift,” he says, “and if we use wine appropriately, it can enhance our lives.”  Two years later, Phelps was on top of a tank that had just been filled with crushed fruit from a relatively new Bettinelli site – and the smell was intoxicating. Following pure impulse, Phelps asked if he could – rather unconventionally – buy the tank’s contents, and Bettinelli said yes. Ad Vivum – inspired by the Latin “vinum” for wine and “vivere” to live, combined with “ad” which translates as “to” or “towards” – was born.  The vineyard was Sleeping Lady (previously Reese), the southernmost vineyard in Yountville, at the foot of the Mayacamas and on the southern end of the valley’s famous bench. There’s a flow of underground water that feeds a creek, with sufficient clay under the gravel and sand to retain water during the dry summer – and has, in Phelps’s words, a “beautiful ability” to self-regulate. Various other producers work with the vineyard, but his two blocks (representing a mere 1.5 acres) are right at the top of the vineyard, below a steep slope that aids the flow of cool air through the site at night. For him there was something special about these plots – producing fruit and wine with what Phelps describes as a “grace note”; it’s a whisper of something that takes the wine to the next level.  In a good year, production for Ad Vivum is 450 cases – but Phelps isn’t looking to grow. He makes one wine, from one site – and that’s the way he wants it to be. The wine is undoubtedly informed by his Franco-American roots, with an elegance, freshness and savoury structure that complements the plush Napa style. As he says, “I try to build wines that speak for themselves.”  Phelps’s – and Ad Vivum’s – story is one of happenstance. Or is it? With a man as devout as Phelps, it seems hard for anyone to believe it’s all an accident – and as Phelps himself says, looking back, it feels perhaps like it’s all part of a master plan.  Explore all current listings of Ad Vivum or read more about California

Divine intervention: Ad Vivum

I first sat down with winemaker Chris Phelps almost two years ago, diving into his remarkable journey. Having worked at the likes of Dominus, Caymus and Inglenook, it was chance – or maybe fate – that led him to establish his own wine label, Ad Vivum, in 2007.  He was sitting above a tank of just-fermenting fruit when he was struck by a “coup de foudre” – falling instantly for Sleeping Lady Vineyard, a site farmed by his good friend Larry Bettinelli. He bought the half-fermented must, and has continued to do so every vintage since.  The specific blocks that filled that tank sat up against the Mayacamas at the very top of the vineyard, which is the southernmost site in Yountville. Here, the vines are shielded from the blaze of the afternoon sun, preserving acidity and aromatics in the fruit, while a flow of underground water allows the site to thrive in even the driest of years. Each year, from just 1.5 acres of Cabernet Sauvignon, Phelps crafts another expression of the site.  The exact parcels have shifted very slightly over time. In 2007, the vines were all Clone 191 – the clone he felt was best on the site, but the block needed replanting so they started using fruit from an adjacent plot, planted with Clone 7. After a “carefully thought-out dance” balancing the two plots, the 2024 vintage marks a return to using fruit only from the original plot, now replanted with Clone 191 (and known as Clone 34, which is genetically identical to 191).  Phelps left his day job (working for other wineries) at the end of 2023, finally able to focus exclusively on Ad Vivum, as well as a newer project with his son Josh (Coil Wines). Although we’d tasted the current releases before, earlier this month we were able to taste a trio of back-vintages for the first time. They reinforced how special this site is, as well as Phelps’s talent when it comes to capturing it in bottle.  The three vintages we tasted were 2016, 2017 and 2018 – three very different years in Napa. All three, however, manage to combine great freshness with Napa polish – creating wines that are surprisingly approachable already.  2016 Ad Vivum  In Phelps’s words, 2016 was “a classic Napa vintage”; the weather was warm at the end of June, allowing the vines to focus on fruit ripening, while autumn brought cooler weather. Phelps harvested from 7th October, fermenting in 21% new French oak (the rest in stainless steel), with a total of 19 days on skins prior to maturation for 18 months in 65% new French oak. It has always had “a seamlessness”, Phelps noted, and that’s certainly true tasting the wine.  The nose offers sweet, dark fruit, graphite purity and hints of lifted florals as well as an herbaceous edge. The palate is linear and pure, with mouthwatering acidity and a savoury core of ripe fruit, sweet cassis and ripe tannins that provide a drying grip on the finish. Although the oldest of this mini-vertical, it almost feels the youngest and will certainly benefit from additional time in bottle. A blend of 56% Clone 7 and 44% Clone 191 Cabernet Sauvignon.   2017 Ad Vivum  The 2017 vintage is one that will forever be remembered for its wildfires in Napa, although fortunately Ad Vivum wasn’t impacted by them. After an early budbreak, the growing season was marked by three heatwaves – in mid-June, at the end of August and in mid-September. Having a cooler site, shaded from afternoon sun and with sufficient water reserves was key for Phelps. He harvested from 5th October, bringing in 55% Clone 191 and 45% Clone 7 Cabernet. It was fermented in 25% new French oak, spending 20 days on skins in total (Phelps noted how easily colour and tannin came in this hot vintage), before being aged 17 months in 70% new French oak.  The nose here is bright and perfumed, combining sweet dark fruit – black cherries and blackcurrant – with floral lift and pencil lead. There’s a glorious purity to the fruit here, which follows through onto the dense yet fresh palate, displaying a juicy elegance. There’s a satisfying chew to the tannins, firm yet velvet-like, framing the waves of fruit that flow towards to the long, saline finish. Mouthwatering and moreish, this is hard to resist now.  2018 Ad Vivum  Although the 2018 vintage in Napa started with relatively late budbreak, cooler, even temperatures made for a long growing season, and producing relatively plentiful yields – yet without any dilution, thanks to the extended season. Phelps harvested from 17th October, with the blend moving back towards around two thirds Clone 191 Cabernet from the original block and a third Clone 7. Fermented in 25% new French oak, Phelps left the 2018 on skins for 23 days – slightly longer than other vintages, feeling structured fruit needed more time to reach its potential, echoed with its maturation in 75% new oak for 20 months. Phelps notes how generous this wine has been from the beginning, but has developed further opulence and depth in bottle.  This is a beautiful wine: the nose is intense, exuberant with dark fruit and a satisfying herbaceous edge. Although the blackcurrant and black plum fruit is beautifully ripe and smooth, there’s bright acidity that brings gorgeous freshness – making for a lithe and vibrant palate. Following on from the cooler, elegant 2018 vintage, 2019 is another excellent year for Napa – together forming an impressive duo that will be enjoyed (and inevitably compared) over the coming decades.  The preceding winter was wet, replenishing the water table and encouraging vigorous early growth. Indeed, as Danielle Aita at Colgin noted, it was still raining in May – with almost 2.5 inches that month (compared to 0.3 inches in 2018, and 0.61 in 2020). It was important for this vigour to be managed, for vines were at risk of growing more fruit than they could ripen. Aita explained how their team had to thin even more than normal, even thinning clusters by removing individual berries to maximise airflow.  A mild spring led to a warm and even summer, with few heat spikes, allowing producers to take their time to harvest, allowing for traditionally long hangtime. Although the season didn’t see the extremes of 2020 or 2022, the mercury did fluctuate, Kassidy Harris at Dominus noted – with a hot June, cooler July, then warmer end to the season. She noted how it required more intervention from the team in the vineyard, managing yield – particularly dropping “wings” or “shoulders” off clusters. This prolonged, relatively gentle heat, as the Dana team highlighted, mellowed the acidity and brought a roundness to the wines.   For Cathy Corison, it was “a fabulous vintage – almost perfect”, and one major factor was the even temperatures, with a significant diurnal shift that encouraged aromatic finesse and retained freshness. She reported temperatures in August that were 21-27˚C during the day, and dipping below 10˚C at night. With these gentle conditions, she picked later than normal, in the third week of September.  Maya Dalla Valle started picking around the same time, emphasising how it’s the last vintage she can remember being able to take her time with – the harvest stretching over several weeks rather than needing to get the fruit in as soon as possible. Aita highlighted how in early October, the temperature dropped significantly at night, slowing the ripening, and they picked in the second and third week of the month.   Temperatures were, on average, a little higher than 2018 – leading to a richer style, darker fruit profile and softer tannin structure – wines that are more classically Napa, compared to 2018’s slight Old World slant. They still, however, have a vibrancy and freshness, and while alcohol levels are higher than 2018, they are not elevated for the region, with almost all sitting below 15%. Volumes are generally good, thanks to that wet winter, a comfort given the low yields of 2020 and 2021.  As Corison noted, “When a vintage is perfect, it’s like falling off a log. Great grapes make great wine.” The winemaker’s job in a vintage like 2022, she says, is to “try not to mess it up”. Dalla Valle opted for shorter maceration times, finding the ripe, thick-skinned grapes offered tannin, colour and flavour quickly. She notes how the wines have filled out with time, offering a “quiet power” that she loves. For Harris at Dominus, it’s a very good vintage, but just an edge behind 2018, not quite as integrated in her view.  Will Harlan and Cory Empting at Promontory compare it to 1990, feeling it has more flesh and power versus 2018, needing time to reveal itself – “an old soul” of a vintage. For Aita at Colgin, the wines have minerality and real expression of place. They are much more approachable than 2018 in their youth, yet have everything needed to go the distance.  The critics all agree that it’s another very good vintage, but are divided as to whether they prefer 2018 or 2019. For Vinous’s Antonio Galloni, the 2019s are “big, bold wines that show the extroverted side of Napa Valley”. He feels it doesn’t quite have the consistency of a truly great year, such as 2018, with that vintage also offering a little more freshness that he prefers.   Lisa Perrotti-Brown MW (then still writing for the Wine Advocate) finds 2019 “classic, ripe, plush and beautifully expressive”, feeling – unlike Galloni – that it is more consistent than 2018, both in quality and volumes. For her, the 2018s are more structured with higher acidity, and may well age longer than the 2019s, however the 2019s have a generosity that is more typically Napa – and possibly more inviting.  For Jeb Dunnuck, it’s "another terrific year“ for Napa – “ripe, supple tannins, beautiful sweetness of fruit, and undeniably delicious”. He argues that it is clearly an excellent vintage, but doesn’t quite reach the levels of 2016 or 2013. The 2020 vintage in California is not one that the state’s natives are likely to forget. Wildfires ravaged the region, and the wines – now being released – are being tainted just by the idea of the smoke that those fires produced. But there is much more to be said about the year – which was also harvested and made in the midst of the covid pandemic, only adding to the immense stress of the season.  The winter was relatively warm and dry, with cool weather at flowering, a mild spring and then a hot, dry summer, although there continued to be a significant diurnal shift – perfect for ripening grapes, retaining freshness and developing aromatics. The heat struck just as producers like Cathy Corison were picking, and – unlike in 2018 or 2019 when the harvest was long – winemakers mostly looked to get the fruit in as quickly as possible. Almost everyone agrees that 2020 was set to be a fantastic vintage before the fires – with small, thick-skinned berries that had great promise. As Steve Matthiasson told us, “It was going to be an epic season.”  It’s important to be aware of the key dates for the fires. The LNU Lightning Complex started on 17th August, however it was the Glass Fire that posed the most significant threat to Napa, with that second blaze sparked on 27th September near the Silverado Trail, east of St Helena.  There are producers that chose to make no wine in 2020 (including Colgin, Joseph Phelps and Shafer), producers who made all their wines, and producers who made a reduced range. Insurance was a challenge. Those who had crop insurance weren’t able to claim if they picked any fruit – so many didn’t take the risk of harvesting what could have been flawless fruit, but also could have been tainted, leaving growers in the lurch, while those that farm their own vineyards were much more likely to give it a go. Some producers were able to share the financial burden with growers, but that wasn’t a viable choice for everyone.  Many producers frantically tested for the phenolic compounds responsible for smoke taint, but the local laboratories couldn’t handle the influx, with tests taking weeks. Some resorted to sending samples to as far away as Australia, while others were fortunate enough to be able to test in house. Mike and Leah Smith of Myriad Cellars, for example, tested all their fruit twice, sending it to Canada, to guarantee there were no free or bound phenols that could taint the wine. Togni reportedly tested their wines, but – having received the official all-clear and bottled the wines – decided not to release them as they weren’t quite convinced.  Micro-ferments were another option to help producers decide whether or not to pick, in theory testing to see if the smoke taint emerged once the fruit was fermented. The nature, however, of the compounds responsible for the taint means that they can emerge in bottle rather than immediately, meaning this offered no guarantees. There were so many complex factors at play, reputational and financial, as well as practical, that made the year a quagmire for producers to navigate. But it doesn’t mean the year should be written off entirely by wine lovers – we’ve tasted some beautiful wines from the vintage that are more than worthy of your attention.  Producers are generally divided by those who picked before and after the Glass Fire – and those who picked before that fateful date in Napa had no issues with smoke taint. There are many factors when it comes to smoke taint (covered more extensively here), including the distance from the fire and the direction of the wind, making it an inexact science. As Steve Matthiasson flagged, however, there was a challenge with ripening in 2020 – with the haze from fires reducing the light level and meaning some grapes weren’t necessarily as phenolically ripe as normal. This, combined with the fact that smoke taint compounds are held in the skins, means that cautious producers tended towards lighter extraction, and in a handful of instances producers even made rosé instead of red wine.  The hot, dry growing season meant that harvest dates were naturally set to be early, but producers who already tend to pick on the earlier side were particularly favoured. Corison had all her fruit in two and a half weeks before the Glass Fire. Her challenge was to ensure smoke didn’t get into the winery, tainting the ferments rather than fruit on the vine. She installed two industrial-grade air filters to keep the smoke out and the resulting wines are “beautiful”. The key for her was to pick as fast as she could, but the ripening season was “almost perfect”, although yields are down around 25% because of the hot conditions.  Maya Dalla Valle is another producer who made a full vintage – one she’s proud of despite it being the most stressful she’s ever produced. Their team picked in the first week of September. They washed the grapes – something that some producers do as standard (eg Dominus) – just in case there was any ash that had drifted from the first fire, using two vibrating sorting tables to shake off the excess water before it went into tank. They also chose to use a little less new oak at first, but after the first racking upped the proportions.  At Dominus, the team picked between 2nd and 27th September, with yields 40% lower than normal due to the heat and drought. They found extra selection was required with shrivelled berries from the dramatic heat spikes seen during the season. Robert Mondavi, however, only managed to make the early-picked whites and Pinot Noir from their more coastal sites, with no Cabernet from 2020.   The conditions forced the team at Promontory to pick early, and while they were already pulling back on harvest dates, they feel the 2020 season was a nudge they needed – a risk that has more than paid off with the stunning wine they produced. For Will Harlan and Cory Empting, the dry start to the season meant the vines and cropload were small, allowing the fruit to ripen sufficiently in the compact season. For them, the year is closest to 2011 or 1998, a year that will likely be consistently underrated and overperform. As vines act as a natural firebreak, few vineyards suffered any long-term damage – however Eisele is an exception, with 90 acres of hillside lost, and 1,000 vines that will need replanting. Fortunately, all their fruit was picked before the fire raged through the property.   With so much unknown about smoke taint, it’s unsurprising that critics seem to be cautious about the year. Reviews and scores are mixed. Vinous’s Antonio Galloni is quick to applaud the efforts producers made in the remarkable year, but feels that some of the wines aren’t very good. He notes, as Steve Matthiasson did, that with nature forcing some producers’ hands with harvest dates, some wines have coarse tannins, however he finds less pronounced smoke taint than in the 2017s.  Jeb Dunnuck advises that it is a year to approach “with extreme caution”, given the unpredictability of smoke taint, however states that “there are some terrific wines” – highlighting those from Bond, Carter, Crocker & Starr, Dalla Valle, Harlan, Paul Hobbs and Spottswoode, to name a few.   Lisa Perrotti-Brown MW (The Wine Independent) compares the growing season to that of 2017, but feels the resulting wines – at their best – are riper and weightier, with more purity. Although there are some wines marked by smoke taint, others are “wonderfully impressive” (indeed, she’s already given Harlan and Promontory 100 points).   The 2020 vintage is far from simple, but it shouldn’t be dismissed totally. There are some beautiful wines, totally unmarred by the year’s conditions. We won’t pretend there aren’t wines that are lesser, although we have to admit this is on hearsay alone based on our tastings so far, but – at the top of the quality spectrum, where finances allow the attention to detail required to achieve excellence – there is nothing for producers to gain by releasing flawed wines. Napa 2020: digging into the difficult year 

South America’s finest Argentina and Chile have rapidly become hotspots for fine wine. Offering high-altitude sites with glorious sunshine, and varied soils, it’s no surprise that some of Bordeaux’s top estates have ventured into the two nations. Cheval Blanc's Argentinian collaboration with Terrazas de los Andes, Cheval des Andes, is unsurprisingly impressive. The estate works with high-altitude sites to produce a Malbec-based blend. The 2018 that is set to be released this year has already been rated highly by James Suckling (98 points), who wrote, “This will be a great wine indeed.” First Growth Ch. Mouton Rothschild works with Concha y Toro in Chile’s Maipo Valley to produce Almaviva – a wine that has, in Suckling’s words, become “a benchmark for the reds of the Andes”. He awarded 97 points to the 2019 and describes it as “extremely perfumed… vertical and integrated”. Bodega Catena Zapata – one of Mendoza’s leading names – will release the 2018 vintage of its top wines, Nicolás Catena Zapata and Adrianna Vineyard Mundus Bacillus Terrae. The latter is a Malbec from a 1.4-hectare plot which sits at almost 5,000 feet, while Nicolás Catena Zapata is the estate’s flagship wine – and Argentina’s first “Grand Vin”, made with the finest fruit from ungrafted vines on the family’s high-altitude sites. Both have earned high praise with the Wine Advocate’s Luis Gutiérrez describing the 2018 as “among the finest vintages for the Mundus Bacillus Terrae” (98 points). The Chadwick family – who own Errázuriz – will also release the 2019 vintages of their top cuvées, Seña and Viñedo Chadwick. Made by Francisco Baettig, these are incredible wines – earning 98 and 99 points from James Suckling, respectively. Last but not least is Clos Apalta, the Chilean estate that produces the finest expression of Carménère in the world. The 2018 is another excellent release, with 98 points from James Suckling. Super Tuscan stars The 2018 vintage in Tuscany was stunning – producing wines of elegance and freshness. While some of the Super Tuscans have already been released, a handful will be available via La Place this month. Masseto – the cult Ornellaia breakout star, described as the “Pétrus of Italy” – and the third vintage of its second wine, Massetino, will be released. Produced in tiny volumes, these extraordinary expressions of Merlot will be in unsurprisingly high demand. Solaia – Tignanello’s sibling from the Antinori stable – is set to be similarly popular, as ever. Giving it 98 points, Antonio Galloni of Vinous wrote, “I can't remember ever tasting a young Solaia with this much sheer appeal and balance in the early going.” The month will also see the latest releases from Bibi Graetz. The artist-turned-winemaker works with old vines and indigenous varieties to produce elegant expressions of Chianti. The 2019 Colore received 99 points from James Suckling who described it as “old-vine magic”, finding the 2019 Testamatta serious and structured (97 points). Cult California September sees a flurry of the Golden State’s most illustrious names hit the market. Opus One – the joint venture between Mondavi and Ch. Mouton Rothschild – is consistently in demand, and no more so for the 2018, with 98 points from Wine Advocate’s Lisa Perrotti-Brown MW and 99 points from Suckling. Having tasted it ourselves – we can vouch for the elegance of the vintage. It’s also worth paying attention to the new release of Overture (also based in the 2018 vintage), which is undoubtedly the best to date. Keep an eye out for the top-scoring 2018s from Vérité (100 points for La Muse, 98 points for La Joie and 97+ for Le Désir from Wine Advocate); the latest release of Joseph Phelps’ Insignia, the original Napa Valley proprietary red (2018 – with 97+ points from Wine Advocate); the 2019s from L’Aventure – the Pasa Robles estate run by Bordelais expat Stephan Asseo; and the 2017 vintage of Dominus (97+ points from Wine Advocate) – the cult wine from Christian Moueix of Pétrus. The new vintage from Maya Dalla Valle – who trained at Pétrus, Latour, Masseto and more, and is now heading up the family estate, Dalla Valle – is guaranteed to fly. The 2018 Maya has already got a smattering of top scores, with 100 points from Wine Advocate’s Lisa Perrotti-Brown MW, who wrote, “As cerebral as it is downright hedonic, this Maya is simply jaw-dropping.” This year will also see the latest vintage of Beaulieu Vineyard’s Georges de Latour Private Reserve – Napa’s first cult wine, and only its second release via La Place. The 2018 has 98 points from both Vinous and Suckling, with Antonio Galloni describing it as “sensational”. Ex-château classics The September Series isn’t limited to the New World – with a handful of estates in Bordeaux and the Rhône joining in, including the annual release of a ready-to-drink vintage of Ch. Latour, after the First Growth left the en primeur system. This year sees a star-studded vintage, 2005, emerge from the cellars. A vintage that needs little introduction, this wine has unsurprisingly high scores; tasting it earlier this year, Antonio Galloni gave it a perfect 100 points, describing it as “life affirming”. Ch. Palmer will also release 2011; while a less illustrious vintage, Robert Parker described it as the wine of the vintage in Margaux. Cheval Blanc, meanwhile, will release the 2019 vintage of Le Petit Cheval Blanc, the property’s highly desirable white. While normally Ch. d’Yquem would also release a vintage of their sweet wine, they are holding back the 2019, so this year sees only the 2020 vintage of Y d’Yquem (the estate’s dry white) released. Looking across to the Rhône, Ch. de Beaucastel will release the 2019 vintage of their Hommage à Jacques Perrin. This cuvée comes from ancient Mourvèdre vines and is made in tiny volumes. Alistair Cooper MW of jancisrobinson.com describes it as “a powerful thoroughbred”. Top wines from further afield A handful of wines from South Africa and Australia have also made their way onto La Place. The 2018 vintage of Klein Constantia’s Vin de Constance – the iconic sweet wine with a long and fabled history – will be released this year, perhaps a comfort to sweet wine fans who won’t be getting their fix with Yquem. Only scored so far by James Suckling (98-99 points), he rightly acknowledges it as a “unique wine”. Two names from Down Under get their second release via La Place this year. The 2017 vintage of Jim Barry’s The Armagh Shiraz – a Clare Valley legend – will be joined by 2018 Wynns John Riddoch Cabernet Sauvignon, a standard-bearer for Coonawarra. New this year This year sees several new names join the September Series. First up is Peter Michael Winery: founded by Sir Peter Michael CBE in the 1980s, this estate has been championing single-site, elegant wines from its corner of the Knights Valley, on the border of Napa and Sonoma, ever since. The 2018 vintage of the property’s Cabernet blends Les Pavots (from a single plot on the original Knights Valley estate, 97 points from Jeb Dunnuck) and Au Paradis (from a site in Oakville, purchased in 2009, 98 points from Jeb Dunnuck). While Robert Parker has spent much of his time rating wine, he also invested in a property in Oregon with his brother-in-law Michael Etzel. The result is Beaux Frères, now part of the Henriot stable, in Ribbon Vale, which produces world-class Pinot Noir. The 2019 vintage of the two top cuvées – from the Beaux Frères Vineyard and Upper Terrace Vineyard – will hit La Place this year. For the first time, Australia’s most famous estate, Penfolds, will release one of its wines, Bin 169 Coonawarra Cabernet Sauvignon. A classic expression of this grape on the region’s terra rossa soils, the 2018 is described as “impressive” by Suckling (97 points). Recently announced is the first vintage of Yjar – a new ultra-premium Rioja from Telmo Rodríguez. It’s described as an “outstanding first bottling” (James Suckling, 97 points) and “a wine that transcends the vintage” (Luis Gutiérrez from Wine Advocate, 96 points). Claude Giraud (owner of Champagne Henri Giraud) – 1999 La Romanée-Conti, Grand Cru, Domaine de la Romanée-Conti “We always spend Christmas with the family and everyone brings a bottle they want to share. This bottle is first and foremost a Grand Cru of Pinot Noir, and we love the Grands Crus of Pinot Noir in both Champagne and Burgundy. Following a bottle of our own Grand Cru – Hommage au Pinot Noir and an MV10 Champagne, of which both would have benefited from a few years of aging, I will serve the Romanée-Conti. I like to drink these wines quite early in the meal, their fragrance, their voluptuousness, and their precision make me happy to continue the meal. This bottle is also a memory of the person who gave it to me on one of my trips to Japan. I will call my friend on this occasion. Because wine is that – beyond a taste, it's a story, a bond of friendship, a touch of humanity that we so badly need for these end of year celebrations.” Sébastien le Golvet (winemaker at Champagne Henri Giraud) – 2011 Único, Vega Sicilia, Ribera del Duero “Christmas with the family at the Girauds is a string of bottles, each more extraordinary than the last. Thanks to my wife Anne (one of Claude Giraud's daughters) I had the chance to discover some great wines. These wines inspire me every day when I am in the vineyards or in the cellar. They make me want to surpass myself and always go further in precision and excellence. Vega Sicilia is one of those first great Spanish wines which made a deep impression on me. I like them old, after 20 years, 30 or more because this is really where Vega Sicilia fully expresses itself. And then I recently drank in Mexico a bottle of 2011 Vega Sicilia and I was amazed. It is so young and already so beautiful! I told myself that I couldn't keep this secret to myself, I wanted to share it with my family. So, coming back from this trip, I immediately put some in my cellar. And the first bottle will be for Christmas.” Tod Mostero (Dominus) – 2005 Riesling Auslese, Graacher Himmelreich, Joh. Jos. Prüm, Mosel “It is finally feeling cold enough here for the subtle fruit and mineral shades of a Joh. Jos. Prüm Graacher Himmelreich Auslese 2005, which may pair well with a grape and quail dish I love at Christmas time. I like to travel in my mind and tell stories with my family at the holidays. This bottle was offered to me by Michael Grimm (our distributor in Germany) and his family shortly after I returned to California in 2007. He and his family have become close over the years. I will also remember Bordeaux, my spiritual family in Libourne, and the gravelly earth and creamy tones of Pomerol soils with a 1982 La Fleur-Pétrus or the pillar of beauty, 2009 Trotanoy – bottles offered to me by Christian Moueix to celebrate the end of year. It is fun to pour a wine and talk to loved ones of the people and places in the bottle.” Gaia Gaja (Gaja) – 1961 Barbaresco, Gaja “This Christmas more than ever the family will gather in full, at my parents' house to celebrate Christmas together. I can’t wait. It will be a long day of celebration, cooking and enjoying each other’s company. Several wines will accompany us throughout the day and surely will be inspiring to the memories. In particular, I am excited to share a magnum of Barbaresco 1961 because this year we are celebrating the 60th anniversary of my father’s great career and this wine was his first step – the first vintage made by him when he was just 21!” Thomas Duroux (Ch. Palmer) – 2009 Malvasia delle Lipari Passito, Caravaglio, Sicily “In July 2011, I went for the first time to Salina, one of the seven Aeolian Islands. I had a little knowledge of the wines produced there but I did not know Antonino Caravaglio. We spent a lot of time together and I had a chance to taste several Malvasia from his estate. I took the hydro-foil ferry back to Sicily along with six bottles of his 2009 Malvasia delle Lipari. This sweet wine, made with dried berries from Malvasia grape variety develop extraordinary aromas with age, such as rosemary bush and dried apricot. This is really something that does not exist anywhere else. I plan to open the first bottle this Christmas and this wine will be my second daughter Gabrielle’s, born in 2009, first sip of wine!” Chris Riesbeck (Westland Distillery) – Garryana Edition 6 “For the holidays, I love to go with big Sherried malts during the colder months – our latest Garryana Edition 6 is just absolutely wonderful. It combines what I love in Sherry (dried fruits) with classic Garry Oak notes of ginger, clove, barbecue smoke. We used quite a bit of ex-Calvados and fruit brandy casks as well, so it’s this fantastic bouquet of candied fruit and smoke (not peat). Aside from that, I have a running obsession with large format (three-litre for the win!) during the holidays. It’s such a fun treat to share those sorts of things with loved ones. This year I’ve pulled a three-litre bottle of Marcel Lapierre Raisins Gaulois 2017 out of the cellar to celebrate.” Francesco Ripaccioli (Canalicchio di Sopra) – 2013 Chianti Classico Riserva, Vigna del Sorbo, Fontodi “One of the bottles that I will definitely open this Christmas will be Fontodi’s Chianti Classico Riserva Vigna del Sorbo 2013 in magnum. This bottle is so special for me for many reasons, for sure it is one of the greatest wines I ever tried, but behind this, there is a family (the Manetti family) and a man, Giovanni Manetti, who at the beginning of my journey in the world of wine was a great sponsor for me, granting me his friendship and his continuous support. Fontodi has been, and still is today the greatest example of how a family-run estate can stay local, while thinking global. I love the 2013 vintage in all of Tuscany and also Piedmont. The wines mature very slow and this is the sign for me of a great vintage. But we can now already start to enjoy something from it for sure.” Frédéric Weber (Bouchard Père & Fils) – 1999 Beaune-Grèves, Premier Cru, Le Vigne de l’Enfant Jésus, Bouchard Père & Fils “Christmas day is the perfect day to celebrate this wine, so it is an easy choice for me. This is a great wine, from an appellation that today is still too underrated. Historically the top wines from Beaune were the most expensive in Burgundy and can compete with some of the finest. I have chosen 1999 because this was in fact the first bottle I bought from the domaine when I joined Bouchard in 2002. It is a fantastic vintage for Burgundy and is drinking beautifully now. I am looking forward to sharing it with my family this Christmas.” Rebecca Jago (The Last Drop) – The Last Drop Très Vieux Pineau des Charentes “This Christmas, we’ll be opening a magnum of Pol Roger I was kindly given last year but further lockdown meant we just didn’t have the company to drink it all! We have a mix of family and friends for Christmas Day and we’ll open a bottle of Newton’s unfiltered Chardonnay (my husband’s favourite), and some Ch. Talbot 2000. And, with the Christmas pudding, I’ll be opening my bottle of our incredible 100-year-old Pineau des Charentes: I can’t wait to share it with our loved ones. As evening falls, a small glass of Tom’s Blend No 1 for a moment of quiet reflection and memories of my much-missed parents.” Martin Donatsch (Donatsch) – 2016 Grüner Veltliner Smaragd, Honivogl, Franz Hirtzberger, Wachau “My motto: It's better to drink a few great wines than to unwrap a lot of presents. Unfortunately, it will be a sad Christmas for us, as it will be the first without my mum. She sadly passed away in the summer after a hard fight with cancer. So, we will be drinking one of her favourite wines in her memory. She loved Grüner Veltliner from Austria, so there will certainly be a Honivogl from our friends Hirtzbergers in the Wachau, which my mother loved so much. For red wine we will have some of our favourites, a 2011 Romanée-Saint-Vivant from Romanée-Conti and a 1989 Haut-Brion. Noblet and Delmas were for us the best cellarmasters ever on this planet. They both inspire me again and again when I drink their wines. For the sweet end, it will be Yquem again... I drink Yquem maybe three or four times a year. But at Christmas, this world-class sweet wine is always a must! Which vintages we open, I decide spontaneously shortly before Christmas but I’m thinking it will most likely be 1999.” David Stewart MBE (The Balvenie) – Balvenie PortWood 21 Year Old "I would probably have a couple of glasses of white wine, generally a Chenin Blanc from South Africa. The wildfires that raged through the region have left a long-lasting mark, whether it’s lengthy reconstruction efforts or the stark, charred tree trunks that cover the mountains. But it’s more than that. To an outsider, the fires feel intangible, terrifying yet somehow conceptual. Talking to those that lived through them, however, makes you instantly realise quite how petrifying that season was. The trauma of those flames is still smouldering away.  In 2017, fires hit Northern California on 8th October, however most producers had already harvested. Indeed, the fire even crossed the Kistler property, but their vines helped act as a firebreak. Two years later the Kincade fire swept through Sonoma County at the end of October. But in 2020, the first fires arrived earlier. The LNU Lightning Complex started with what is known as the Hennessey fire on 17th August. Sparked by lightning after thunderstorms, the complex was a weave of 250 different fires that collectively raged through almost 150,000 hectares of the region. The damage was enormous: 1,491 buildings were destroyed and six people lost their lives. While the fire did diminish in size, it wasn’t entirely extinguished until 2nd October, almost a month and a half after it started.  Before the Lightning Complex had fully subsided, the Glass Fire attacked. The blaze started on 27th September, east of St Helena near the Silverado Trail, spreading north to Calistoga and then south and west, towards Santa Rosa. It burned until 20th October, encompassing over 27,000 hectares and taking over 1,500 buildings with it, including numerous wineries. It cut through Eisele Vineyard, across 90 acres of hillside and forcing them to rip up 1,000 vines. Fortunately they’d already picked all their fruit (finishing their harvest three days before the fire broke out, on 24th September). And this was all in the midst of Covid-19.  Wildfires aren’t new in Northern California, but they’re certainly more prevalent than ever before. Indeed, as Cory Empting – Director of Winegrowing at Promontory, Harlan and Bond – tells me, the region’s indigenous people, the Wappo, used to describe autumn as “smoky mountains”.  Paul Hobbs – who has been making wine in “the Valley” (as the locals would say) since the late 1970s – remembers a fire in the 1980s that burned its way along the Silverado Trail. “All it took was a gust of wind,” he says – and one flame turned into something uncontrollable in the blink of an eye. He remembers climbing up on a roof to see the sobering effects of the fire.  Perhaps partly due to this early exposure, fires have always been at the forefront of his mind when picking a site – avoiding rugged, dry areas like Diamond Mountain or Calistoga. And he is exacting with forest management of the sites he works – even on our wander around his Goldrock Estate vineyard, he notices some saplings that are troubling him, and calls over his vineyard manager to take a look, conscious to reduce the risk as much as possible. And he’s deservedly cautious. The 2017 vintage was his first working with Cleary Estate out in Freestone-Occidental, and he paid almost $2 million for fruit that he couldn’t use. The fire itself is one challenge, however vines are natural firebreaks so don’t tend to suffer much direct damage (although the heat from a blaze can sometimes scorch vines). The real threat, however, is in the air – smoke. But the science of smoke taint is complex, and poorly understood. Producers can send samples to laboratories to be tested for the compounds responsible for the taint (guaiacol and 4-methylguaiacol) but the exact level of perception isn’t known. These compounds also naturally occur in some varieties, eg Syrah, and come from oak barrels (in particular the toasting process).  Of course the impact of smoke is dependent on proximity to the fire, the intensity of the smoke, elevation and the wind. Hobbs explained how in 2020 much of the smoke from the Glass Fire stayed north for several days, but then the wind shifted and sent it south to the Bay Area. As smoke travels, and ages, the volatile compounds also degrade, so there is also a significant difference between the impact of “fresh” smoke, versus what Hobbs describes as “atmospheric” smoke. The latter may look bad, but it’s unlikely to hold significant taint, whereas if you’ve got fresh smoke, it’s “game over”.   Lots of producers do micro-ferments to look for smoke taint, testing to see if it’s worth the expense of picking the fruit and making the wine – however that’s also not a sure-fire way to know if you have smoke taint. The nature of these compounds means that they can lurk, undetectable in a wine, and emerge in bottle as hydrolysis occurs. “That’s why it’s so insidious,” Hobbs says.  If you’ve got smoke-tainted fruit, the options are limited. The compounds are concentrated in the skins, so the aim is generally to minimise skin contact. Indeed, some producers made rosé in 2020, having picked earlier, with higher acidity than normal. Otherwise you can use reverse osmosis or spinning cone (both expensive processes that are used for de-alcoholisation), or carbon fining – or a combination of all of the above – to try and strip out the smoky flavour. The result, as Mark De Vere MW at Robert Mondavi said of trials they’d done, it generally didn’t work, but if it did, “It took so much else out.” (Robert Mondavi ended up making almost no 2020 wine.)  *  Read anything about 2020 and there is a cacophony of opinion. “Everyone handled the vintage differently,” Cate Kistler of Occidental told me. They picked on 18th August, not in response to the fire, but because that was when the first fruit was ripe. They didn’t do any micro-ferments or send samples to labs (“We’re not data-crunching people,” Kistler says). The cost of picking was, for them, “a drop in the bucket” in comparison to farming the vineyards the rest of the year, so they tried to do what they could.  “It was going to be either Occidental, or nothing,” she said with a shrug. They took their time, committing to making every decision as if it was a normal year, finishing on 6th September just as the Labor Day heatwave hit. They didn’t use everything they picked, but they made all five of their single-vineyard wines – and the 2020s we tasted are glorious.   Some, like Colgin, didn’t make any wine at all, while many producers made around 40% less (such as Williams Selyem and Peter Michael). Many of the 2020s that will be released were picked before the fires struck. Cathy Corison had all her fruit safely in the winery more than two weeks before the Glass Fire hit, but the challenge was to keep the smoke out of the winery. She bought industrial grade air filters to shield her ferments. “They’re beautiful,” she says with a quietly proud smile.  At Dalla Valle, Maya Dalla Valle doesn’t pretend that it was an easy year, but she’s pleased with the wines they made (all with fruit picked before the Glass Fire). As ever, these are wines that speak of their year – which wasn’t just the fires, but a hot, dry year that (along with a block that was being re-grafted) cut their crop to a mere 2,700 cases in total. At Dominus, they did micro-ferments after the Lightning complex, and had picked their last row of fruit on the morning the Glass Fire broke out.  Steve Matthiasson – the leading viticulturalist who also has his eponymous label with his wife Jill – told me how it was set to be “an epic season” before the fires hit. He highlighted how the smoke meant there was less UV light reaching the grapes, and that meant the fruit wasn’t as phenolically ripe. They pick early, so had started harvest 10 days before the Glass Fire broke out. The Cabernet Sauvignon in their Phoenix vineyard was still out, but they managed to pick it the morning after the fire broke out, before the smoke was able to take effect.  Most who picked early are in agreement that the hot, dry conditions were in their favour. Promontory saw only eight inches of rain, versus the 30 of a normal year. But that hydric stress helped them – it meant the crop was small and the vines shifted to ripening the fruit earlier, so even though they picked on 22nd August they had no pyrazines. As Will Harlan says, in some ways, “The stars aligned”.  The 2017 vintage might have prompted people to start thinking about climate change, but 2020 was a real wake-up call for the region. It prompted Martin Reyes MW to try and create a community around climate action. Eventually, working alongside Anna Brittain, he founded Napa RISE (standing for Resilience Innovation Sustainability Empowerment), a climate and wine symposium that first took place in 2022 (with the 2023 symposium currently underway). It’s early days, but they’re “trying to build into the DNA [of Napa RISE] this notion of action”. He’s keen to avoid a conference focused on discussing concepts, but an industry convention that drives change.  One part of that conversation is inevitably fire – and a session last week focused on forestry management. “The relationship with fire we have is complicated – but it can be a healthy relationship,” Reyes tells me.   Controlled burning has long been a part of life for indigenous peoples – both in North America and Australia, where wildfires have now become a threat. In the US, controlled burning was officially banned in 1911 when the Weeks Act was introduced, but California is gradually realising the need for its reintroduction.  “Agroforestry was happening before conservation took it off the table,” Empting (of Domain W. Harlan) tells me. He talks about how when the previously evicted Miwok people were allowed to return to Yosemite, they were horrified by what they saw – where “conservation” had destroyed the ecosystems. For native peoples, seasonal work like controlled burns was a way of life – seen as their responsibility to the land. But it was a responsibility that colonialism robbed from them, and didn’t take on.  At the Pepperwood Preserve, native peoples do controlled burns. Empting visited to explore the practice and see if it’s something they could take up as part of their stewardship of the land. The challenge today is the paperwork – and politics. Permits are difficult to obtain, the fire department is reluctant and has to be involved, and then there are the neighbours to contend with.  Hobbs highlights that it’s not just that there aren’t enough controlled burns, but that manmade structures have taken over swathes of land – and they burn hotter, leading fires to rage in less predictable ways.  Of course, as with 2017, the 2020s are already being marred by rumour and reputation of a smoke-tainted year. The reality is so much more complex – and, although I haven’t tasted enough to make pronouncements on the vintage, there are some brilliant wines. Of course you’ll need to choose carefully, but for top producers there is nothing to be gained by releasing wine that is anything less than flawless.  While the fires have left scars, the land’s capacity for renewal is remarkable – with vibrant vegetation flourishing in amongst the scorched trees. The 2020 vintage wasn’t the first to see such challenges and it won’t be the last. The soils can recover, and so can the people, but a sustainable way to manage these threats is essential to long-term survival. Read more about California or browse all California listings
