Lebanon's lost legacy: viticulture Despite being more southerly than the great wine regions of Europe, the Beka'a’s elevated altitude on average around 1000m above sea level – means that it’s a full 10ºC cooler than Lebanon’s Mediterranean coastline. The climate is positively European with wet, often snowy winters and warm, dry summers. It’s very well suited to winemaking, a local craft that dates back millennia. Lebanon itself is geographically situated in the cradle of civilisation. It was here, even before
the Greeks and Romans emerged as dominant cultures in the Mediterranean, and the Canaanites (later known as Phoenicians), peace-loving traders from the Levant, established some of the earliest known well-organised cities: the trading ports of Byblos, Sidon and Tyre. Phoenician culture was at its peak between 1500 and 300BC – a period that saw them explore and dominate the Mediterranean, developing trade routes, setting up outposts and cities as far afield as North Africa (Carthage, now Tunis, Tunisia) and the Iberian peninsula (Gadir, now Cádiz, Spain). The word ‘Phoenician’ directly connects the people of the Levant with both an impressive entrepreneurial spirit and an awe-inspiring work ethic. More precisely, it is an exonym originating from ancient Greek that describes Tyrian purple. This highly prized dye was a major export of the Canaanite port towns, in particular Tyre, hence the name. The labour-intensive production of the colour involved collecting the mucous secretions of thousands of sea snails. 12,000 snails yield a paltry 1.5 grams of dye – which is why it was so highly prized and the clothes it coloured were reserved for royalty. Tyrian purple was not the only ingenious product that the Phoenicians exported. Their legacy also includes the invention of glass-blowing techniques, and the development of the very first abstract (non-figurative) writing system (from which the Greek alphabet was derived) is credited to the Phoenicians and their Canaanite ancestors. It was almost certainly developed primarily to keep records of sales and ultimately function as an essential accounting tool. We also have the Phoenicians to thank for the word ‘Europe’ – which comes from their word ‘Erob’ meaning ‘where the sun sets’. While it is thought that the world’s first-ever wine was made over 8,000 years ago in the Caucasus Mountains between the Black and Caspian Seas to the northeast of the Levant, it was the Phoenicians that produced, exported and made famous the ‘fragrant wines of Lebanon’ mentioned in the Bible’s old testament (Hosea 14:7). And with their grip on Mediterranean trade, they marketed it and exported it along with, crucially, the knowledge of how to make it. The agricultural treatises of Carthaginian writer Mago, (thought to be writing around 350 BC) were among the most important early texts in the history of wine to record ancient knowledge of winemaking and viticulture. It’s important to remember the function of wine in society in Phoenician times. It wasn’t just a drink. It was, rather like the Tyrian purple dye, complicated and labour intensive to make, exceptionally highly prized and valuable and not just because of how it tasted – but because of its effect and function.  Biomolecular Archaeologist Professor Pat McGovern at the University of Pennsylvania Museum is a specialist in fermented beverages and his research reveals more about wine in Phoenician life. “The wines of ancient Lebanon and Syria,” he says, “were much more than a technological marvel. They were the social lubricants to break down barriers, stimulate music and the arts and bring people together. They were the supreme religious symbol for prosperity and well-being, in life as well as death. And they were the medicines for dissolving and dispensing botanicals, to rest the weary, relieve pain and cure disease.” Taking their wine to the Pharoahs of Egypt and further west to Portugal to trade it for local silver and tin, Phoenician winemaking equipment has been discovered in Valepeñas in Spain. As Phoenicians established Cádiz (Spain) as early as 1100BC, it is most likely that Phoenician wines – not Roman wines – were the forerunners to sherry. Perhaps the most enduring legacy of these seafaring traders was, in fact, the propagation of ancestral grapevines from the Levant that ampelographers believe gave rise to several modern grape varieties in Europe. According to research published by the University of California-Davis on the Integrated Viticulture Online Database, the French wine grape Mourvèrde may have first been introduced to the wine region of Catalonia around 500BC. By 64BC, Seleucid Syria and Lebanon had been annexed to the Roman empire by emperor Pompey. Peace and prosperity followed as the people of Byblos, Tyre and Sidon were granted Roman citizenship. Trade boomed and new wealth generated from exports of cedar, pottery, jewellery, perfume, purple dye and wine to Rome, enabled an era of widespread construction and urban development. One of the building projects the Romans invested in at this time was the enhancement of the already millennia-old temple complex at Baalbek in the Beka'a Valley. At a site which the Greeks and the Romans referred to as Heliopolis 'the City of the Sun' (where Phoenician god Ba’al had once been worshipped), the Romans rebuilt and reconsecrated the temples to their gods Jupiter, Venus and Bacchus, gods of wine, fertility, ritual madness, festivity, dance and theatre. The 700-acre site remains, to this day, the largest and best preserved Roman temple complex anywhere in the Empire. How the ancients moved the 800-ton quarried stone blocks that form the base of the temples still baffles the world’s brightest engineers. The temple to Bacchus at Baalbek is a monument to the importance of wine in the region, and the site became a symbol of Lebanon itself in the 1960s, thanks to the cultural impact of the Baalbek International Festival. Established in the mid-1950s, the festival brought celebration, theatre, music and dance back to the site through performances by international music stars and, crucially, nurtured and celebrated home-grown talent, perhaps most famously Fairouz and the Rahbani Brothers who became huge stars in Lebanon and right across the Arab world. Lebanon’s potent winemaking heritage is not lost on the makers of Chateau Musar. Far from it. As well as its vineyards in the Beka'a, the winery also grows vines near Byblos and the Hochar family’s charismatic winemaker, Tarek Sakr, is as passionate about the history of the land as he is about the grapes he grows there. “Byblos has been known since Phoenician times as an exporter of cedar wood and wine,” he enthuses. “Vines were cultivated in the hills surrounding Byblos, fermented in stone vats dug into the landscape. Then, the wine was put in Canaanite jars (these were the predecessor of the Greek amphora – yes, Phoenicians invented these too), sealed with resin to stop oxidation, and taken to the harbour for export.” Tarek also tells of a recently discovered archaeological site in the village of Edde a few kilometres from Byblos. “The site suggests that most of the hills near the city have been growing vines for thousands of years. This makes sense as the place where our nearby vineyards are located, on a hill overlooking Byblos, is called Vines Passage. You can smell the history of winemaking here. This is undoubtedly the birthplace of viticulture.” While he has spent many years planting and tending to its vines as an integral part of the Musar winemaking process, Tarek’s knowledge of and connection to the land and its ancient traditions run even deeper than his many years of experience. The result of a DNA test found that he is genuinely of Phoenician descent. It would seem that when it comes to Lebanon’s unrivalled contribution to the world of wine, we still have much to thank the Phoenicians for. Explore more Editorial

The wines of Lebanon: a phoenician phenomenon

A couple of years ago, I wrote a book called Time Tamed. In retrospect it is an ambitious title. Even at the time I realised as much, describing man’s efforts to tame time as being a task as Sisyphean as it is Canute-like. Humankind invented time to make sense of the world around us. It can be argued that an understanding of time – and the ability, however rudimentary, to track it and act according to it – is right up there alongside the ability to fashion tools and communicate using spoken language, as one of the characteristics setting humans aside from the other species with which our planet is shared. In the beginning at least, the extent of our relationship with time was a cognitive reaction to phenomena that permitted the prediction of cyclical seasonal events such as the migration of animals, and later forecasting the effect of variations in terms of temperature and daylight hours on the flowering and fruiting of crops.   The triumph of human intellect, and the beginning of our species’ march to its position at the apex of life on our planet, was to make conscious use of this intellectual edge that allowed us to benefit from the recurring patterns of events foretold by observation of such astronomical phenomena as the rising and setting of the sun, the waxing and waning of the moon, and the lengthening and shortening of the diurnal span. Lunar phases repeat themselves in a cycle of 29½ days; the tropical year as measured, say, from winter solstice to winter solstice (when the day is shortest and night longest) is approximately 365¼ days. The interaction of the solar and lunar calendars, providing, respectively, the year and the 12 months in it, gave us the framework upon which to build civilisation. “If time was conceived as the precise measure of an ordered succession of states, it should come as no surprise to find that its first criterion of measurement in every known civilization should have been the movement of the stars (which is both movement and return, in other words a ‘constant periodical appearance’)”, wrote Umberto Eco. He next posed the rhetorical question: “Even if there were nothing more to time than this, it would still be interesting to ask why, for so many centuries, men measured out the years, the months, and the days, but came so late to measuring hours and minutes. The main stumbling block was the need for mechanically precise instruments to measure them.” Calendars of varying degrees of sophistication have been in use for millennia. In my book, I wrote about a series of 12 fire pits in Scotland that – in conjunction with the known location of sunrise through a mountain pass on the morning of the winter solstice – functioned as a calendar in the Mesolithic period, 10,000 years ago. Compared to that, widely available accurate timekeeping is only a relatively recent phenomenon. Had you asked a medieval peasant the time, he would have probably told you what season it was and, as recently as the mid 19th century, time was measured according to local meridians that gave a local solar noon. Britain, at the time the world’s preeminent industrial power, only got its first real taste of unified national time in 1851, when millions visited the Great Exhibition, travelling from all corners of the Kingdom by trains that ran to a single national time. But in the last couple of centuries the pace has hastened: we have become, as Eco put it, “children of a clock civilization”, and I am sure there are those who would argue that it is from there that many of our problems have arisen.   The industrialisation of time was of particular interest to Karl Marx. “The clock is the first automatic machine applied to practical purposes,” he wrote to Friedrich Engels in 1863, “and the whole theory of production of regular motion was developed on it.” Even though abstract, time had become the ultimate economic commodity. Life became lived according to the maxim ‘time is money’ and with a Gradgrindian myopia we have concentrated on ever smaller divisions of time until we have become not children but slaves of the clock. Time was never tangible, but in the past it linked human experience to the cosmos through the tracking of solar and lunar cycles. The division of time into units that are independent of astral cycles has distanced us from the natural rhythms of life. Division of time into small units standardised around the world has facilitated the synchronisation of activities that enable us to live in our modern world of ‘just-in-time’ production, conurbations with populations of millions, and a network of integrated transport systems that allow us to travel from one side of the world to the other well within the span of a single day. It has taken the recent and as yet unresolved upheaval wrought upon our carefully organised world by the COVID-19 pandemic to reveal the humbling fragility of the system by which we live and regulate our lives. Moreover, one could argue that it is the application of monetised time that is responsible for the ravages that we have perpetrated on our planet in pursuit of our industrial goals. But before we blame the rise of the timepiece for the ills of the world, there is an aspect to watchmaking that can enable us to reconnect with the cosmos in a way that is familiar to those conversant with the world of biodynamic winemaking. So, when the editor of FONDATA suggested biodynamic winemaking as the prism through which to view watchmaking, I was intrigued. Once upon a time, a long time ago, I did work in the wine trade. However, we parted company during the 1980s, some time before biodynamic winemaking became what I believe is called ‘a thing’. Obviously, all readers of FONDATA understand the basic principles of biodynamics, but I needed to undergo a quick crash course in what is just one of the legacies of the quite extraordinarily colourful and at times controversial Rudolf Steiner; the late 19th- and early 20th-century Austrian philosopher, social reformer, writer, educationalist, editor, architect, spiritualist, scientific spiritualist, mystic, Goethe superfan, campaigner for the independence of upper Silesia – and much more besides. He came up with everything from a new, quasi-religious movement called ‘Anthroposophy’, to a new approach to medicine; a new artform, ‘Eurythmy’, to a new form of agriculture, ‘Biodynamics’. Steiner turned his fecund and agile mind to the problem of agriculture in the early 1920s and addressed many of the concerns that we are still grappling with a century later, advocating a sustainable ecologically-oriented approach to farming that eschewed chemical pesticides and fertilisers in favour of natural alternatives and conducting agriculture based on an astronomical and astrological calendar. Steiner is memorable because he could enliven even the relatively practical activity of growing things with woo-woo mumbo jumbo of a level to which even Gwyneth Paltrow can only aspire: for instance, burying manure in a cow horn over winter and then exhuming it; or controlling infestations of field mice by sprinkling fields with the ashes obtained by burning the skin of a “fairly young mouse” obtained “at a time when Venus is in the sign of Scorpio”. And yet, such was the power of his way of thinking that it would be wrong to characterise him as a total crank: Steiner was apparently taken seriously by Hitler as a threat to National Socialism.  But back to wine. Prima facie, there is little to link the joyous celebration and bounteousness of viniculture with the mechanical slicing of hours into minutes, into seconds into milliseconds. However, to view watchmaking as being just about the business of telling the time is to underestimate what is in my opinion one of the most engrossing areas of human ingenuity and creativity, where science, mathematics, mechanics and art meet. I like to think about watchmaking as being connected to the detection and calibration of rhythms and patterns … biodynamic farming is all about rhythms and patterns, especially those of the lunar calendar. In his writings, there are times when Steiner could be writing the script for Star Wars – when he talks of entering into “the forces that regulate growth, crucially the ‘fully-evolved Moon-force’”.  The Biodynamic Association uses less picturesque language to summarise the approach, saying that the philosophy of biodynamic farming is founded on “the influences of the moon, planets and constellations on plant growth”. “Each month the moon moves through all twelve constellations of the zodiac in turn. This is referred to as the moon’s sidereal cycle and forms the basis of the biodynamic calendar. Although the waxing and waning (synodic) cycle is the most well-known lunar rhythm, it plays a small part in this calendar.” The indication of moon phases has long been a feature of watchmaking, and even if knowing whether one is living under a waxing gibbous moon is not of primary importance to most of us, the function is undeniably decorative when artistically transferred to a watch face – the moon disc, often decorated with a background of stars, making a complete rotation once every 29½ days. Watches with more advanced astronomical functionality feature sidereal time as well. And this year, the long-established watchmaker Jaeger-LeCoultre demonstrated that it is capable of getting seriously cosmological. To celebrate the 90th anniversary of its famous Reverso model, it released the world’s first four-sided watch, the Hybris Mechanica Quadriptyque. As its name suggests the Reverso flips over to reveal its back. Initially conceived as a protective measure, more recently the back has been used to display other information (another time zone for instance). Now, the cradle in which the watch sits on the wrist has also been mechanised to offer two further planes for display – much in the way that one can connect multiple screens to a single computer rather than having to be constantly opening and closing windows. And Jaeger’s watchmaking wizards have turned faces three and four into a banquet of lunar information.  On the interior face of the cradle there are three displays giving the synodic cycle in the northern hemisphere, the draconic cycle (the height of the moon) and the anomalistic cycle (apogee and perigee, when the moon is respectively furthest from and nearest to the Earth), while the fourth side of the watch gives the synodic cycle in the southern hemisphere.   It sounds like an observatory on the wrist and according to the makers: “the Hybris Mechanica Quadriptyque can predict the next global incidence of astronomical events such as supermoons and eclipses – the world’s first wristwatch to provide such a deep reading of the cosmos.” I imagine even Steiner would be impressed especially as in biodynamic circles cosmological connections are crucial. Biodynamic agricultural activity is governed by knowledge of the behaviour of celestial bodies: ascending moon days favour certain agricultural activities while other tasks are better performed on descending moon days. Eclipses, apogee, perigee, and new moons all have their associated agricultural messages for the biodynamic farmer.   “It’s connected into the cosmos,” explains Philippa Hegarty of Hegarty Chamans, a vineyard in the foothills of the Montagne Noire in the Minervois. “We find an explanation that people respond to is; if the Moon has such a strong tidal influence then it can certainly move sap up and down a vine and that’s what we work with at different times of the year.” Providing timing of the movement of the tides is another function that the mechanical clock or watch can perform; indeed it is one of the oldest, predating the minute hand, the second hand, the wristwatch and even the pocket watch. The provision of times of high tide by a mechanical timepiece can be traced back to the 14th century and the famous Astronomical Clock designed by Richard of Wallingford, Abbot of St. Albans – which as well as showing the fixed stars and charting the movements of the sun and moon (complete with ecliptic nodes – another important feature for biodynamic winemakers) gave the times of the tides at London Bridge.   In fact, the technical leap forward accomplished by clockmakers in the 14th century rivals that of computer networks in our own time: at the end of the 13th century time was still being told by clepsydrae (like an hour glass but with water instead of sand) and by the middle of the following century, man was mapping the cosmos using mechanical machines of unimaginable complexity. If Giovanni de Dondi’s Astrarium of 1364 looks a little like a lunar landing module, then that was not the only thing it predicted. About a metre high and standing on protruding feet, the Astrarium featured seven panels with dials that showed the movements of the sun, moon and the then-known planets: Mercury, Venus, Mars, Jupiter and Saturn. Further dials indicated dates of fixed and moveable religious feast days, the intersections of the solar and lunar orbits, and time of sunrise and sunset. In comparison, the 24-hour clock seems prosaic, almost otiose. Another common feature of these miracle machines of the Middle Ages was the zodiac. Rather than being relegated to the horoscope section of the tabloid press, astrology was as much of a science as astronomy, and a medieval megaclock could not take itself seriously without a dial or two depicting the signs of the zodiac. The celebrated Three Kings Clock of Strasbourg Cathedral was no exception. As well as its astrolabe dial, ecclesiastical calendar, carillon mechanism that filled the air with religious music, and the automata that replicated the nativity, an illustrated panel linked signs of the zodiac to body parts, connecting human health with the movements of the celestial bodies, thus indicating propitious or hazardous times for that key medical procedure of the times: bloodletting. The influence of the zodiac constellations is an important part of the biodynamic playbook. “Since ancient times the twelve zodiac constellations have been associated with each of the four elements: earth, water, air and light,” observes the Biodynamic Association. “Three constellations are connected to each element, and each element is related to a part of the plant: thus, Earth – root; water – leaf; air – flower; fire – fruit.” “For example, for sowing or harvesting carrots, an earth – root day should be chosen; for lettuce, a water – leaf day; for beans and apples, a fire – fruit day; and for flowers and broccoli, an air – flower day.” As the example of the Jaeger-LeCoultre Hybris Mechanica Quadriptyque shows, thanks to the technological advances that have accrued during the last 20 or 30 years, the miracle of modern mechanical watchmaking is that it is able to miniaturise cosmological functions and place them on the wrist. Recent years have seen some truly spectacular wristwatches enter the market. Patek Philippe’s double-faced Sky Moon Tourbillon is regarded as one of the trophies of modern watchmaking: featuring minute repeater with ‘cathedral gongs’; tourbillon; perpetual calendar with retrograde date hand; day, month, leap year in apertures; hours and minutes of mean solar time; moon phases; and on the reverse, moon-focused watch face, sidereal time, sky chart, and phases and orbit of the moon. Van Cleef & Arpels caused a stir when it released a watch that condensed the workings of a planetarium onto the wrist with a watch charting the movement of the five planets visible to the naked eye from Earth: Mercury, Venus, Mars, Jupiter and Saturn; each planet orbiting on its own disc in its real rotation time. Blancpain, meanwhile, has tackled the notoriously complex lunisolar Chinese calendar to create a watch that displays the ten celestial pillars, the five celestial elements, the phases of the moon, the animal associated with the year and the date as given by the Gregorian calendar. I am neither watchmaker nor winemaker, but given the approaching centenary of Steiner’s 1924 series of agricultural lectures which gave birth to biodynamics, now might be a propitious time to consider a mechanical timepiece that displays the cosmological information pertinent to biodynamic viticulturists and farmers. We talk to Europe’s leading glassmakers from the 250-year-old Austrian family-run firm Riedel to the young dynamo behind Grassl, which launched in 2018. We also speak
to Jancis Robinson MW on her recent collaboration with British designer and master craftsman Richard Brendon, who explains that traditional glass types have long been in desperate need of modernisation. Legend has it that Marie Antoinette’s breasts provided the outline for the creation of the
coupe, the shallow-bowled champagne glass that graced the lips of Hollywood’s starlets during the Golden Age, and enjoyed regular appearances in episodes of Mad Men. When it comes to wine glasses, aesthetics has historically taken precedence but functionality has risen to the top of the priority list.  Wine has long suffered an injustice at its final destination whether it’s champagne, sherry or claret. Designer Richard Brendon recalls his first meeting with Master of Wine, Jancis Robinson. “She said she’d never understood why white wine was put in a smaller glass than red wine and described this as discrimination. Champagne producers hate flutes because they don’t allow for any of the aromatics to get out of the wine, likewise Sherry and Port producers don’t like the small glasses that their wine traditionally gets put in.” There are a growing number of glass companies aiming to redress the balance. And, in the
same way as every winemaker in Burgundy has his or her own particular way of producing the perfect Pinot Noir, every glassmaker has a view to crafting the most suitable vessel in which to pour it.  Austrian-based Riedel has gone down the route of a glass particular to a variety from Chardonnay to Zinfandel while Brendon has followed Robinson’s one-size-fits-all advice.  “Jancis was entirely confident that we could create one glass that worked perfectly for every style of wine,” says Brendon” but we also needed two decanters to ensure we have a collection that works for every wine.”  With 40 years of experience tasting wine, Robinson set out the specific parameters for her ideal glass. “The widest part of the glass should be exactly 125ml or one-sixth of a bottle. This would mean when a standard pour is served, the wine will have maximum surface area, allowing for all of the aroma to get out of the wine,” he says.  “Jancis wanted a nice tall bowl to allow for the wine to be swirled in the glass to get more of the aromas out of the wine, and that the opening of the glass should be as small as possible to trap the aromas of the wine, but still big enough for even the largest of noses! The thickness of the rim was of utmost importance, she wanted it to be gossamer-thin so that you hardly notice the glass when taking a sip. “ Gossamer-thin is an apt descriptor for Zalto’s glassware, particularly the elegant, fine stems
that induce a certain nervousness in the holder. It’s a far cry from the heavy cut-crystal glasses that adorned the dining tables of previous generations. Daniel Primack of Zalto’s UK importer WineRackd admits such delicacy can be a concern initially but “with perfect balance in the hand and such fine construction, you may worry that you’re going to break them just by drinking from them but fear not,” he says.  “They are mouth-blown and cooled very slowly making them incomparably tough for something so fine. Zalto’s own recipe of the three main ingredients for creating crystal, silica, soda (sodium carbonate) or potash (potassium carbonate) and lime (calcium oxide) also contribute to the clarity and durability. They are blown differently to other Austrian glasses, with the bowl and stem formed as one piece, then the foot attached. A more usual arrangement is for the stem to be glued to the bowl. Remember the attachment point is a weak point” Staying in Austria, Riedel is perhaps the country’s most famous glassmaker in the wine world, producing an impressive 60 million glasses annually at its three factories. The 250-year-old company now uses machines to make 95% of its glasses. The company’s UK managing director Stephen McGraw says “we can produce machine-made glasses which are almost indistinguishable from handmade glasses.  However handmade glasses are still very important to us, as we preserve a skill which is still recognisable to the techniques used in Roman times. In terms of machine-made versus handmade? The glasses will all perform equally well, from a sensory point of view.” He adds that its unusually shaped decanters are a different matter: master glassmakers, who tend to have around 15 years of experience to be at the top of their game, can only make these intricate objects.  A much more recent addition to the glass scene is Swiss brand Grassl, which launched in
2018.  Founder and wine collector Alexander Mackh, who is just 26 years old, explains its conception. “I launched Grassl Glass because I didn’t enjoy the proportions of the glassware on the market. Finer, deeper, less-extracted, less-oaked wine [styles] require different glassware, so I decided to create my own.”  Prototypes in hand, Mackh tested the glasses on some of Burgundy's top winemakers as well as heading to the finest names in Bordeaux including Châteaux Ausone and Palmer. Tweaks were made accordingly and now the Slovakian-blown artisanal glasses can be found as far afield as South Korea and Australia.  
What is the magic number?  While Brendon and Robinson have created just one wine glass, Grassl’s magic number is four. The designs include Liberté, which is ideal for medium to low acidity white wines, which are oak aged and 1855, a glass for reds high in tannin, richness and alcohol. If push comes to shove, Mackh says “If you wanted just one glass that does the job, it would be the Liberté as an objective tool for tasting." Riedel is known for its varietal-specific glasses and there are myriad options but there has to
be genuine rationale behind a new style. “A glass designed for a specific wine must show that wine better than any other, non-specific glass would,” says McGraw before explaining the ongoing process that shapes its bowls. “We design and test our glasses together with winemakers. Through a series of tasting workshops, we fine-tune and hone the shapes of our glasses until the winemaker tells us that the glass is showing his wine correctly. Further, after a glass is designed and in production, we do continuous testing and tasting workshops to ensure that the glass is as relevant still as the day it was first designed.” However, there’s no need to be rigid in what you pour in the grape-specific glasses. Riedel has a glass, for example, that suits rosé Champagne, Nebbiolo and New World Pinot
Noir. You certainly won’t go to wine hell if you also use it for a glass of Chardonnay. Primack agrees: “The names are simply a guide to identifying the bowl. They were named this way as 15 years ago, it was the convention to use a wine name. Today, Zalto stress it is not a prescription for the contents. For example, many people appreciate certain styles of White Burgundy in the Bordeaux bowl. This has been proven time and time again”.  Function has now won over form in the wine glass arena but that’s not at the expense of beauty.  When the UK entered the first coronavirus lockdown in March 2020, there was a sense that the end of long, thoughtful, funny and serious conversations was dangerously close. Over a Zoom call, sat at our respective kitchen tables, F+R’s Patrick O’Connor, creative director Alan Aboud and myself, a journalist and editor, started to wonder if we could work together in some way to explore topics usually explored at the communal tables that were sadly empty.  The first project we worked on together marked the 90th birthday of iconic Lebanese winemaker Chateau Musar and the simultaneous publishing of a book celebrating the winery by Académie du Vin Library. Working together with music consultant Leo Walton, we conceived a package of content for FINE+RARE’s website to coincide with F+R’s exclusive release of various mixed cases of Chateau Musar vintages going back to the 1960s.  As part of the content package, I wrote three articles for the F+R website, and worked with Leo to create four Spotify playlists featuring Lebanese music from the relevant decades of the Musar vintages being released: the 1960s, 1970s, 2000s and 2010s. Leo and I also suggested the potential to add more cultural context to both the wine and our selection of music by producing a podcast in which we interviewed a Lebanese musician about musical culture and heritage in the region. We explored various ideas before interviewing two members of the Beirut Groove Collective – a group of DJs with a reputation for unearthing records from the 1960s, 70s and 80s and giving them a new audience. We asked the DJs to give us the low down on their legendary all-night vinyl-only parties in Lebanon’s capital, and about Beirut’s surprisingly vibrant music scene throughout the Civil War (1975-1990). We also asked Ernesto about his new reissue project with BBE Records and the first release in the series: Ihsan Al-Munzer’s 1979 synth-led Belly Dance Disco album.  This idea – of creating original editorial content that proactively ventured into topics in and adjacent to the worlds of fine wine and spirits in order to enrich the FINE+RARE experience – immediately appealed to all involved. Between us, we started to flesh out the idea for a new content platform that could explore and commission stories that took advantage of our combined knowledge, skillsets and networks, plus FINE+RARE’s access to the best producers and most interesting personalities driving quality in the worlds of fine wine and exceptional spirits.  While the concept was always for FONDATA to be a multi-media platform whereby we would produce content in whatever medium seemed most relevant to a given subject matter – podcast, video, blog or print – we focused our initial efforts on producing a large-format, print journal. It would provide a brilliant canvas for us to commission the best writers, photographers and illustrators, and it would also be the perfect format to function as a physical mission statement, something we could send to F+R customers. Doing this in 2020, when we were in lockdown, seemed like a great way to maintain connection and morale in an unprecedented moment in living memory. We formed a small ‘bubble’ to sit, appropriately distanced, in Patrick’s back garden in Hackney to brainstorm the idea and start mapping out what stories we could potentially commission for our first FONDATA journal. For the inaugural issue, one story in particular was pivotal to realising our ambition: commissioning American essayist, author and regular contributor to The New Yorker, Adam Gopnik to write a piece for us. In his book, Paris to the Moon (Quercus, 2000), Gopnik likens Jean-Philippe Derenne’s L’Amateur de Cuisine book (Éditions Stock, 1996) to “a medieval almanac, offering a timeless, secure, benevolent universe of food.” In our initial conversations, we’d identified Wine Grapes, A complete guide to 1,368 vine varieties, including their origins and flavours (Allen Lane, 2012) – the weighty 1,240-page tome authored by Jancis Robinson MW, Julia Harding MW and Dr José Vouillamoz – as a book we’d love to celebrate in some way. We wondered if Gopnik would be as enamoured with the book as much as Derenne’s and if he’d write something for us about it and its value to wine lovers and gastronomes alike. We duly sent him a copy of Wine Grapes (clothbound and slipcased) and a note introducing ourselves and outlining FONDATA’s ambition. He loved the book and the idea for the piece, so we contacted Jancis to ask if she would be happy to be interviewed by Adam. It turned out they were both fans of each other’s work. Our first feature was underway. But how would we present the piece? What would FONDATA look like? Alan asked Jancis if she would agree to be our cover star for our first issue. When she agreed, we had to work out how to bring the inaugural cover to life. “Gavin Bond popped into my head,” Alan, recalls, of the task at hand, “as he has become the ‘go-to’ photographer for celebrity portraits, especially in the film and fashion business. I felt Jancis deserved that status and reverence. Of course, the wine world reveres her, but no wine journal seems to be able to look beyond a shoot involving wine bottles and grapes.”   With Gavin Bond on board, the next step was to think about the shoot itself. “We enlisted the help of a wonderful floral design company, Studio Lupine,” Alan explains of his art direction. “We briefed Raggie Furuseth, the designer, to create a wildly original space in which Jancis could be photographed. The resulting portrait is a stunning and sensitive study of one of the world’s most learned and charming wine writers in her prime.” Another crucial part of our first issue planning was around design concepting and setting out our production values. As a kind of guiding light, Alan and I had adopted a mantra: “This isn’t a magazine”, as FONDATA would have none of the concerns of a regular magazine. We didn’t want to print on flimsy paper. We didn’t want to create something predictable or ephemeral, but rather an object that felt it had more permanence, more lasting value. FONDATA, we were all very clear, would strive from the outset to be a joyous, opulent celebration of cerebral, long-form editorial content.  Alan began working with his studio designer, Haley Austin, exploring different oversized formats, experimenting with page layouts and type treatments to realise his vision for how FONDATA would look. At the same time, he commissioned Rick Banks of Foundry 37 to create a bespoke logotype for FONDATA’s masthead based on his F37 Caslon typeface. We also adopted F37 as our core typeface for body copy, and to use at large scale for feature headlines and beautiful, full-page pull quotes.  In terms of our editorial direction, we were keen from the offset to commission editorial that explored evergreen (and ever-fascinating) topics. What does it mean to collect? How has the pandemic affected our lifestyles, and how much of that is positive? How do ideas germinate, and how does genius emerge? How important is history and tradition to innovation and revolution? What are the most significant drivers and the biggest hurdles for excellence? Once the Gopnik feature was in the proverbial bag, we set to work commissioning an issue full of features that we hoped would appeal to a wine-loving audience but not feel like we were trying to sell them something.  We approached Jancis Robinson’s co-authors of Wine Grapes, Julia Harding MW and Dr José Vouillamoz, to call out five relatively obscure grape varieties from around the world to champion them and the producers making remarkable wines with them. We also commissioned botanical artist Sarah Jane Humphrey to illustrate each variety.  We asked the former director of London’s Design Museum, Deyan Sudjic OBE, to contemplate the history of social spaces. To accompany his feature, we asked him to approach a number of highly regarded architects and interior designers to illustrate their visions of social spaces of the near future. As a result, we soon added John Pawson, AB Rogers, Paloma Strelitz, and Jon Marshall to our list of contributors. We tasked journalist and author Dylan Jones OBE with critiquing wine’s critical landscape, connecting him with some of the world’s leading wine writers and critics to discover how the pandemic had reshaped their work lives and lifestyles.  Author and historian (and one of the most elegantly dressed gentlemen about town) Nicholas Foulkes very literally wrote the book on cigars. His son, Max, is a Master of Havana and works at Davidoff in Mayfair. And it was Nicholas’ father-in-law who first introduced him to the pleasures of cigar smoking. Especially for our first issue, Nicholas pondered the joy of his relationship with his sons and the idea of passing cultural knowledge and enthusiasms from one generation to the next. We commissioned Julian Broad to shoot a portrait of Nicholas with his sons.  I spent time talking with restaurateur-turned winegrower Alex Xu and wrote a piece about how he’d come to completely reshape his future by planting three hectares of Pinot Noir and Chardonnay vines in the foothills of the Jade Dragon Snow Mountain in China’s most idyllic province. I also interviewed Waterford distillery owner Mark Reynier to find out how (and why) he’s bringing notions of terroir, traceability and transparency to the fore in the world of single malt whisky.   Meanwhile, British chef and food writer Thom Eagle contemplated the value of spending more, rather than less, time in the kitchen, and artist Stewart Walton illustrated the piece.  We commissioned educator and business guru Germana Di Falco to interview fashion designer Brunello Cucinelli about his philosophy to business and life itself, and we engaged British-born, LA-based writer and critic Geoff Dyer to chart the slow journey towards appreciation of and reverence for well-chosen wine. The issue signs off with a Letter from California penned by winemaker Maya Dalla Valle, who reflects on her 11-year journey to become the winemaker at her family’s celebrated vineyard in Napa. The resulting inaugural issue is everything we hoped it would be. As Patrick says in his publisher’s letter on its very first page, it is a celebration. One that delivers rich, engaging editorial content in a format that feels lavish and collectable in and of itself. “It is also a collective,” he continues. “The best minds brought together to tackle the subjects that captivate, so arresting in their absence – experience, space, people and family. [This issue] became a journey into the sound of the things that matter to the soul of the collector, the reasons things exist, the FONDATA.”

It is hard to write the history of the future, but I hope that I am on safe ground when I say that the global pandemic of 2020 will be the defining event of the early 21st century. I say ‘hope’ because God help the human race if there is anything more defining waiting around the corner. By saying as much, I do not in any way diminish the other spectres that have haunted the dawning decades of the third millennium: among them mankind’s age-old companions, intolerance, religious fundamentalism and greed. Nevertheless, the pandemic has humbled humanity in a new and special way, combining our oldest foe, disease, with swift, easy, international travel – until recently one of the most central aspects of our technical and cultural advancement. Death and destruction, like everything else in life, are neither evenly nor democratically apportioned. Nevertheless, there can be few, if any, people on the planet whose lives have been untouched. Maybe there is a tribe of rainforest-dwelling Pygmies, cut off from what we hubristically call civilisation and which continues to exist in a state of prelapsarian Stone-Age ignorance. But the rest of us have been simultaneously confronted by our mortality, the fragility of our lives and, in many cases, the vacuity of our dreams. We reacted in different ways, retreating into what we found comforting. Some (yes, you, David Geffen) used social media to let the world know that they were safe on their yachts. Others explored the restorative powers of one of the most fundamental and symbolically domestic of rituals: baking bread. My own reaction was somewhere between these two poles. Within just a few days of the pandemic being declared in the UK, I had taken to the virtual airwaves with films – exquisitely directed by my younger son – of me smoking cigars with my elder son and dilating on the joys of the fragrant blue smoke of Havana cigars. Trivial perhaps, superfluous almost definitely, but to me immensely significant. It is hard to express the emotional impact of this activity without resorting to cliché, but then clichés tend to be clichés because there is an element of truth in them. And while the term ‘intergenerational male bonding’ is an arid form of words that traduces the emotional value of the experience, it also begins to explain its worth. But more than just finding a new way of communicating with my children, I like to feel that I am passing on something from which they can derive satisfaction; I was first inculcated into the world of the cigar by my stepfather-in-law – who splendidly encapsulated the appeal as being “the feeling of well-being” derived from learning how to wield this refined instrument of pleasure. Pleasure and well-being are the inspirations of these broadcasts (as I rather self-consciously, antediluvially, call them), and to my surprise they established a moderate but relatively enthusiastic following. Given that I am old enough to have children in their 20s, I am also old enough to regard the idea of using a telephone to make a home movie that has no actual physical presence, and that can be viewed via another intangible medium, as being pretty close to witchcraft. I find it remarkable that as many as 15,000 people – most of whom I have never met, living I know not where – tuned in to watch two men in slightly extravagant clothes (we wore safari suits, cowboy outfits, boating blazers, dinner jackets, business suits and tweeds) set fire to tubes of tobacco and try and convey a sense of the flavours they were tasting. But more than a degustatory sensation to be relayed, it was, in its way, an act of cultural transmission that in its essence is not very different to the role of say, indigent troubadours that wandered the courts of 12th and 13th century Provence, or the griots of the Mali empire of the 14th century, telling stories of noble exploits of the past. As we sat amongst its fragrant swirling wisps and gossamer tendrils; the sacred smoke of the cigar would unlock the past and liberate fragments of memory from wherever it is that memories are imprisoned and presumed forgotten. As we shared the flavour and the experience, recollections of my visits to Havana over the last quarter-century would be summoned unbidden – oxymoronic though that may sound. I remembered names of rollers, long conversations with factory directors and days spent in the fields of the plantations. I recalled meeting an ancient torcedor who had started work as a child and he remembered rolling cigars for Winston Churchill. I was reminded of a long afternoon spent on the terrace of the simple home of the late Alejandro Robaina, the Cuban tobacco farmer, whose time-furrowed face would give the pachydermic features of W.H. Auden stiff competition. He sat in his rocking chair and retrieved his own memories of how the climate had changed over the course of a generation, and of the taste of his first cigar, enjoyed before the age of 10 during the 1920s. However imperfectly, I was able to transmit these memories to my children in a setting and an atmosphere that made those memories theirs too. It is the associative power of the cigar to stimulate memory that raises it beyond the mere intake of nicotine, and instead elevates it to the level of a cultural activity. Proust had his madeleine and I have my cigar. I pick the cigar because it has been a personal comfort during a difficult time, but the same can be said to be true of any skill-laden and ritual-rich activity that is passed from generation to generation. I enjoy traditionally made clothes and I find the idea appealing that many hands contribute to the making of a single garment. It may be better-made than its ready-to-wear counterpart, it is likely to last longer and fit better – but these are only the tangible aspects. At the risk of sounding pretentious, there is what one might call a spiritual element to having clothes made. There is something uniquely appealing about clothes that have been made only for you and it is an appeal to which I succumbed almost 40 years ago. I first got into having clothes made for me long before I could afford it, when, as an undergraduate at Oxford, I fell under the spell of a charming old tailor called Stamp, Mr Stamp to his friends. He was a fabulous old boy with a shop on Broad Street, or The Broad as I believe we were encouraged to call it at the time, just down from Castell where he had started as an apprentice half a century earlier during the 1930s. He made me a pair of trousers, a blazer and few other items including several remarkable waistcoats. One of the best moments came when I took in a 50-year-old, double-breasted waistcoat for him to copy. He looked at it, examined a label sewn into the underside of the backstrap, peered at the stitching around the buttonholes, and then told me that the garment had been made for a well-known Spitfire test pilot, gave me the price of the fabric per yard in 1936 and – most impressive of all – informed me of the name of the man who had stitched the buttonholes.  My first shoemaker Eric Cook also beguiled me when he took a look at a pair of Lobb correspondent shoes, turned them over and was able to identify the man who had finished them because of the slightly elliptical curvature of the heel and the spacing of the nails.  For me, such knowledge is just as impressive as that of the connoisseur who can identify a long-lost masterpiece by examining the brushstrokes and the state of the canvas or wooden panel on which the paint was laid. But, unlike the admiration of an acknowledged masterpiece by a globally renowned artistic genius, the quality of such pleasures is more personal and, arguably, more meaningful. It was Franz Liszt who said, “A good Cuban cigar closes the door to the vulgarities of life,” but the same is true of the contemplation of a well-sewn buttonhole, or the anglage of a well-finished watch movement. Such pleasures may be only fleetingly experienced, but I would argue they are all the more precious for their intimacy: watches and clothes are worn on the body, the cigar is consumed – becoming in some way part of the body and stimulating the mind. These are things that ornament life, that raise the quotidian to the memorable and that transcend the disagreeable nature of too much of life today. I suppose that this is what is meant by ‘luxury’. I had been hoping to get to Paris to catch an exhibition, at the Musée des Arts Décoratifs, devoted to the controversial subject of luxury, mounted under the aegis of my friend Pierre-Alexis Dumas, creative director of Hermès, who understands the field better than most. “While the luxury object resists definition by any single concept, drawing instead on shifting, eclectic visions, we might nonetheless agree that it possesses one distinctive characteristic above all others,” he told me. It is, he believes, “an object we keep, respect and cherish, one that archaeological discoveries across the globe reveal as speaking timelessly to us, its human power undimmed, resonant with distant emotions. Today, at a time when luxury seems to hold omnipresent status, in the media and in social networks, it is perhaps pertinent to recall that the luxury object is precisely one that is preserved and passed on – a magnificent, enduring conduit of culture and knowledge, bearing witness to human ingenuity.” The overuse of the word ‘luxury’ has led to its trivialisation, but there is a sense in which the pandemic has helped me transmit to my children something of my view of its true meaning. In a world of ever abbreviated communication, the chance to spend time in contemplation of what I love with those I love has been a gift – and the suspension of the ceaseless restless turmoil that we regard as normality, has shorn many so-called luxury items of their status-conferring function, allowing us to see them for what they are, to winnow the impostor from the authentic. I hope that I have conveyed, however clumsily, what it is that I appreciate, and uncovered something of the culture and values that make them important to me. My sons are fascinating people, their company is genuinely instructive for me, I see things anew through their eyes and this in turn has added further richness to life’s pleasures: not just appreciating the intrinsic qualities of, say a cigar or a suit, but in enhancing that appreciation by seeing it reflected in my children. It is a powerful combination of culture, emotion and enjoyment. Whether a vessel of personal memory, a conduit for the great values of humanity, or a bulwark against the deadening combination of fear and tedium of recent months: the superfluous, to misquote Voltaire ever so slightly, has seldom been so necessary. Credit: Classic Images (Alamy Stock Photo). It took a shock to the system on the scale of the Covid-19 pandemic to demonstrate how much our lives can be reshaped by the humblest of objects. When restaurants, hotels, cafés and night clubs have all been closed for months on end – and when we are excluded even from each other’s homes – then park benches and patio heaters become stand-ins for the more elaborate architecture of everyday life that usually enable the interactions we depend on to function as social beings. For much of 2020, only the most rudimentary tools for conviviality were left to us. This works better at some times, than others. On a warm sunny day, all it takes to create an instant convivial space is a bench. This simple structure is the means for people to meet, share a view, a conversation, and perhaps a picnic. Add a back, arms, and a USB charger plus a Wi-Fi connection to the bench, and the proposition grows layers of complexity. It has become a people-attractor and a conversation starter too. This last year has helped us to understand better how to appreciate, through their absence, the things that make us the most human: being together, sharing food, drink and conversation, and marking the key moments in life. While we were forced into isolation, our attempts to replicate some of these experiences, with the use of a screen and a fitful broadband connection, showed us how inadequate they inevitably are. The experience suggests that social change, when it comes, is about an acceleration of what already exists – more than it is about a complete reinvention. Buying more online than we ever did in department stores is going to be a permanent shift. Some of us are less likely to fly to Australia for 24 hours for a business meeting than we were in 2019. But there are other things that will not change. We will still want to celebrate birthdays and weddings in the company of others. We will always want to meet our friends and look for chances to make new ones. And we enjoy doing all those things in the kind of spaces and places that make the most of the moment, which can make the seemingly routine into an occasion. Even at the basic level of the park bench, there are nuances to deal with. Chatting side by side is not the same experience as a face-to-face conversation. However, for some people, direct eye contact is as aggressive as an all-caps text message. It is why a walk in the park can be the best way to share a secret, and why Sigmund Freud conducted his consultations from behind the back of his couch. What we sit on is as significant as how we sit. In the average western living room in the 1960s, the armchair was the seat of power, occupied by family patriarchs. The matriarch, if she was lucky, got a slightly smaller version to herself. The sofa was designed in the same style, just large enough for two, and was for the use of supplicant sons-in-law. As the domestic world has expanded, so the sofa has taken on the dominant role over every other piece of domestic furniture. Sofas have been getting bigger for some time and are now reaching the size of lifeboats. They’re expected to cope with everything from conversation to work, assuming multiple roles as stand-in dining table, desk and bed. Social spaces, from the most intimate scale to the grandest, form an essential part of both our personal domestic worlds – in which we share our privacy with a selected group of friends and family – and the public one that we all share. It is a scaled sequence that runs all the way from a candlelit interior with a couple of chairs, a plain wooden table with two wine glasses, to the Galleria Vittorio Emanuele II in Milan, which, with its heroic iron-roofed arcade, has a strong claim to be regarded as the mother of all shopping malls. When it opened in 1877, the newly empowered bourgeoisie (in their straw boaters and stiff detachable collars) took to it as the setting for their daily promenades on the way to and from the Duomo, Milan’s cathedral, where they celebrated Mass, or en route to a performance of a Verdi opera at La Scala. Stopping to take coffee and pastries, they would meet each other for an aperitif at Biffi or dinner at Savini, and explore the exotic wares that the shops in the Galleria had to offer. As futurist artist Umberto Boccioni demonstrated in his painting from 1910, Riot in the Galleria, there was a darker side to such spaces. He portrayed the agitated response of a turbulent crowd of well-dressed spectators to the sudden violence of a fight between two women – sex workers perhaps. The disturbing scene, depicted in pointilliste style (and based on an incident that actually took place), is bathed in lurid electric light, evoking the frenzied atmosphere of this giant outdoor room and its extraordinary impact on the behaviour of a mass society. An unintended consequence of the lockdown has been the enforcement of the monogamy-based model of the nuclear family. It made the year particularly difficult for all those who don’t subscribe to it. We will need places we can dress up for again, places we can show off in, even places in which we can behave badly. The painting is, in some senses, a reminder that urban life is essentially about tolerance. Complex spaces have always been a vital part of urban life. Almost 2,000 years ago, the Romans built the Baths of Caracalla on a lavish scale, with three separate pools, libraries and gymnasia – and gardens large enough to accommodate 1,600 people at a time in comfort. Its mosaic and marble floors, its frescoes and sculptures made it one of Rome’s essential landmarks, not only as a monument to the glory of the emperor who built it – though it certainly was that – but also as a place to be used by people, day and night. Its magnificence, and the sense of the joy of a great shared civic space, inspired the American architect Charles McKim when he designed New York’s Pennsylvania Station, one the most sublime railway stations ever built. The central waiting room, barbarously destroyed 50 years after it opened, was a convincing recreation of the baths of Caracalla that lifted the spirits of anyone who passed through it. The months of isolation have taught us how important shared spaces of all kinds are to the way that we live. They are the places in which we meet each other to celebrate the important rituals of life, as well as to pursue the seemingly trivial (actually essential) compulsion to gossip about one another. As an essentially self-conscious species, we need alibis to give ourselves permission to be convivial. We construct reasons to meet each other, like the 19th century clubs of Pall Mall, or their democratic paraphrase – with its provision of gender segregation, and games room, and its mix of intimacy and ceremony – the Victorian pub full of mirrors and cut glass. Or in today’s context, a bowling alley configured to allow players and their friends to sit at a table, order food and drinks, and watch each other play, and to hear each other converse. Some public spaces do better at conviviality than others. The Las Vegas casino, for example, is designed to be the opposite of convivial. Slot machines on an industrial scale obviate the need for any form of human interaction. With its glass dome, and 25 miles of bookshelves, the old round reading room at the British Museum is certainly a very special space, although it has now lost its intellectual raison d’être and has become a dead monument. In its day, a reader’s ticket conferred membership of an exclusive club that included Oscar Wilde, Vladimir Ilyich Lenin, and George Orwell. But as the museum’s insistence on silence suggests – beyond unspoken flirtation over the book stacks – it was not a place that was fundamentally about conviviality. The Berghain Club, the raw, concrete world capital of techno music based in a redundant power station in Friedrichshain, in what was once East Berlin, is another very different kind of public space, and – in its own way – an equally spectacular social space. It has a pickier door policy than the British Museum but a similarly committed membership. In this case, the limit on conviviality is not silence, but the sheer volume of sound that makes the 18-metre-high main spaces vibrate, and which makes conversation inconceivable. A truly convivial space needs to work on multiple levels, to offer a variety of zones, some of which can encourage concentration, and others that can be distracting. Some may be more intimate than others. It’s a drive that is leading to an interesting range of cross-fertilisation. Cinemas that serve food more ambitious than popcorn and hot dogs are being equipped with sofas instead of tip-up seats. Health spas come with restaurants. However, not all convivial spaces encourage multiple uses. Orchestration and control are part of the experience at those English clubs that frown on members showing any signs of working, to the extent of asking them to put away notebook and pencil – never mind laptops – over lunch. Some aspects of what we have learned from the last year will colour life well into the future. The private dining room is a long-standing restaurant tradition, which has been given a new lease of life. We can also expect to see signs of change in the workplace. The Silicon Valley model has aspired to look as domestic as possible, furnished with sofas and kitchen tables, surrounded by vintage and deliberately non-matching chairs. A year of working at home is likely to encourage a more formal environment. But while we continually try to find new tools to make conviviality possible, the objectives remain the same. In a year in which all our assumptions about how we live together have been turned upside down, the world’s designers and architects have had to face the challenge of how to deal with the impact of the pandemic on our homes and our cities. As city centres empty out, and people avoid crowds, how can we find ways to socialise?

John Pawson Architect John Pawson has always focused on the idea of designing the architecture of conviviality. In his recently released Home Farm Cooking book, produced with his wife Catherine and published by Phaidon, we see what matters most. Every Pawson interior is designed with how it will feel to use it in mind – is it to be enjoyed by somebody on their own, or with others? He takes away the distractions and lets us focus on how we use and feel in a room. He makes some spaces in which to read and to concentrate, others in which to share the preparation of a meal, and yet another to enjoy the result in company. Intrinsic in his philosophy is the importance of creating a setting where one can appreciate light at different times of the day – whether it is the shades of white as revealed by degrees of sunlight or the warming effect of firelight by night. johnpawson.com AB Rogers Ab Rogers was inspired by the spontaneous street life of the neighbourhood in 
East London in which he lives and works to come up with a range of furniturelike structures to give social spontaneity a helping hand. “Whether it’s planned 
or serendipitous, we wanted to design a set of colourful pieces that could help 
to turn a momentary catch-up on the street into an impromptu drinks party, 
anchored by a tuned-up bollard. Or make a surprise anniversary dinner possible 
under a street lamp … or make a breath of fresh air turn into a long lunch with 
new friends at a long table under the trees.”  abrogers.com Paloma Strelitz Paloma Strelitz, an architect, and co-founder of the Turner Prize winning 
collective Assemble, took an overview of how shopping streets might recover 
from lockdown, to generate new life: “convivial, accessible, sustainable and 
enjoyable for all”. The experience of negotiating streets in which precautions 
against the pandemic had caused restaurants and food shops to migrate to 
the pavement, made her think about ways to make this a permanent quality.
“It’s an opportunity to empower local business. Shops could open their 
facades to the street, creating an expanded space of public interaction, and 
daily theatre.” She would keep the car in its place, with priority for pedestrians and bikes, 
and banned altogether at weekends. What were once parking places would 
become green borders, combining play space, raised planters, flower beds 
and trees, allowing the street to become a promenade. Meanwhile the street 
would be animated not just by cafés, but studios and workshops putting the 
making process on show. Oh, and a mobile bar too.  assemblestudio.co.uk Jon Marshall  Jon Marshall, an industrial design partner at Pentagram in London, found himself 
thinking about ways to bring together two very different kinds of object: a hamper, 
designed to carry utensils food and drink securely, and a shooting stick. “They 
aren’t really about shooting,” he explains. “The shooting stick is actually a very 
convenient way of carrying the means to sit anywhere with you.”  The hamper allows for the sense of anticipation that comes from preparing for 
a pleasurable occasion. The two objects have very different aesthetics – one is 
vaguely mechanical, the other has a kind and rustic quality. For Marshall, the idea 
of the shared walk – with the chance of stopping for a picnic – is the very essence
