“It’s been an absolute pig of a year,” says Mark Gaskain. It’s September 2024 and we’re reaching the end of what has been a trying growing season across most of Europe – with seemingly never-ending rain. Fortunately, Gaskain knows that such challenges are just part of the job. He’s a farmer, born and bred, now at the helm of his family business, and responsible for growing 70 million apples a year. But in the last decade, he’s added a new strand to the business – after selling a swathe of land to none other than Champagne Taittinger in 2015. That land is now the home of Domaine Evremond – one of the most exciting English wine projects to date.  The story began almost a decade ago. Patrick McGrath – founder and CEO of Hatch Mansfield, which represents Champagne Taittinger in the UK – had been looking at adding an English sparkling wine to the company’s portfolio. It was the early 2010s, and he spied an opportunity with the burgeoning category – but Pierre-Emmanuel Taittinger suggested that, rather than taking on an existing estate, McGrath should create his own, working with Taittinger. Taittinger had embarked on a similar venture in California, creating Domaine Carneros with their US agent, Kobrand, under Pierre-Emmanuel’s uncle, Claude. Together, they decided to take the plunge.  They charged leading English wine specialist Stephen Skelton with helping them find the perfect site – determined to have chalk soils, south/southwest-facing slopes (for maximum sun exposure) at altitudes below 100 metres (with temperatures reducing by 1°C per 100m, anything above this would simply be too cold in England’s marginal climate). Kent – with easy access across to Champagne – was decided on, but it took them 18 months to find the right site. At the same time, the Gaskains were looking at selling some of their land (a foray into soft fruit had proven challenging, and were looking to get back to their core business of apples). The timing was fortuitous and the orchards at Stone Stile Farm – around the village of Chilham, southwest of Canterbury – were perfect. As Alexandre Ponnavoy (Chef de Cave for both Taittinger and Evremond) told me, if a site can grow good fruit – it’s a good indicator for its viticultural potential.  In 2015, the deal was signed and the project launched with great fanfare at Westminster Abbey. Domaine Evremond takes its name from Charles de Saint-Evremond (1614-1703), a Frenchman, essayist and early ambassador for the wines of Champagne – bringing them to the court of Charles II – who is buried in Poets’ Corner. Although Didier Pierson – a grower in Champagne – had made English wine under the Meon Hill label, Taittinger was one of the first major Champagne Houses to invest in England (Pommery had bought vineyards in Hampshire in 2014). Unsurprisingly, press coverage was extensive: the Champenois were coming to make sparkling wine on our home turf – the French naysayers set to eat their hats as the world started facing up to fine English fizz.  Evremond’s first vines went in the ground in 2017, with more added in 2020 (the team set up at the local Premier Inn to tackle the work mid-pandemic) and in 2024. The land here has a layer of alluvial clay over its chalk subsoil which is part of the Paris basin, shared with much of northern France (including Champagne). Around Canterbury, however, there’s more flint in the soil – something that Ponnavoy feels shines through in the wine, giving it a mineral, reductive character. There’s also a definite maritime influence – moderating temperatures, but also bringing ocean breezes from Whitstable, which is just six miles away. For Ponnavoy, it’s the combination of the site’s chalky soils, maritime softness and sea winds – a “contrasting climatology” – that defines the Evremond wines.   Gaskain is deeply involved in the project – his in-depth knowledge of the land an invaluable resource, knowing where potential frost pockets lie, for example, or where the soil might be overly rich for vines. He and his team manage the site day-to-day, guided by Christelle Rinvelle (Taittinger’s Vineyard Director). Currently, they have 62 hectares of vines, split between 45% Chardonnay, 45% Pinot Noir and 10% Meunier. They planted Chardonnay on areas with the thinnest topsoil, allowing its roots almost direct access to the chalky bedrock, while the Pinot Noir and Meunier sit on the more clay/gravel-rich plots.  The vines are widely spaced (5,000 vines per hectare – half the vine density Taittinger uses in Champagne) and trained higher than across the Channel, allowing for better airflow (helping manage disease pressure) and a larger canopy (to aid ripening). While herbicides have never been used on the site and there’s a concerted effort to be sustainable, Gaskain is clear on the limitations of viticulture in Kent: “Organics is madness in this climate,” he tells me – as, perhaps, 2024 proved. While the team has vine-specific sprayers, Gaskain can also draw on his team’s orchard equipment too – a boon when conditions are challenging – and spray the entire site in one (rather long) day.  They harvested tiny quantities of fruit in 2018 and 2019, with the first commercial-sized vintage coming from 2020 (conveniently the grape harvest falls neatly between that of Galas and Braeburns). Early wines were made at nearby Simpsons, and from 2020, they set up in an old concrete barn on the site – with the entire operation run on a generator. In June 2022, they broke ground on a new winery (“We were over budget four weeks after starting,” says McGrath, with a weary smile). The same company that worked on the Channel Tunnel dug out 83,000 tons of chalk (around 2,000 lorry loads) to make way for the three-storey building that stretches 20 metres below ground. Designed by Reims-based architect Giovanni Pace, the idea is for the winery to blend into the landscape – rather than stand on it. It has the capacity to cellar 1.5 million bottles – all without expending any additional energy on cooling, thanks to its natural subterranean chill.   Works were finished in time for the 2024 harvest – a relief undoubtedly for the team. There is something charmingly British, slightly ramshackle and underdog about the operation – despite the very serious money behind it (£17 million invested so far, reportedly). “Everybody’s had to muck in,” says McGrath. He might be Hatch’s CEO and one of the Evremond founders, but he’s also the first to pull on his wellies to help with harvest – and has spent more weekends in the vineyard than anyone else. Vitalie Taittinger has taken over from her father as President of Taittinger, and McGrath’s daughter India is running the commercial side of Evremond – meaning the operation really is a family business, even if it comes with some luxury, Champenois-esque swagger.  With the Taittinger association, of course, expectations are incredibly high – something McGrath is painfully aware of. Talking to Ponnavoy – who is in charge of the winemaking at both Taittinger and Evremond – there’s been something very exciting about creating a project from scratch, even if it has come with some challenges too. He argued to keep the small 2018 harvest for the property only, allowing them to follow the wines in tank over several years, and get to know the site. It was a huge cost, and delayed the first release, but something he felt was crucial.  “It was really important not to do a copy of another sparkling wine, not to produce a… ‘style’,” he says. Their goal, instead, was: “To identify the terroir, to identify the soil, to identify the climate, and reproduce all that in the bottle. To find the Evremond identity.” Inevitably, there’s a temptation to draw comparisons between Taittinger and Evremond, but the team is clear that they are totally separate projects with very different DNA.  Working with English fruit, Ponnavoy felt it was key to manage the potentially biting acidity (and the wine sees full malolactic as a result), but – for him – the greatest challenge was to avoid a bitterness that he finds common in some English wines. Managing the phenolics to avoid this was, for him, therefore essential, while he also focused particularly on the bubble texture – working to get a very fine mousse, something that he believes sets the wine apart from the competition.  In time, Evremond hopes to make 400,000 bottles a year, although there are only 120,000 of its first release. There are plans to add a vintage and rosé cuvée once the vines have matured and they’ve gotten to know the site, but for now they’re only producing the non-vintage Classic Cuvée. Now, a decade after they bought the land, Edition 1 of the Classic Cuvée is set to be released. For a début, it’s an incredible result – perhaps not surprising given the pedigree of the operation. Incredibly fine, taut and layered with oyster-shell, iodine and flint, it’s a wine full of the promise of what Evremond can do.  Domaine Evremond’s Classic Cuvée Edition 1 will be released on Thursday 3rd April: contact your Account Manager to register interest or sign up to be notified here

“I was broken-hearted,” says Tim Mondavi, his eyes glistening at the memory of how his family was forced out of their business, Robert Mondavi Winery, 20 years ago. Wine runs through the Mondavi family’s veins. Cesare Mondavi – Tim’s grandfather – made his first vintage in 1919, and the family purchased Charles Krug Winery in 1943, before Robert broke away to establish Robert Mondavi Winery in 1966. Luckily, when Constellation took over the business, the Mondavis left with “a bag of money” – something, Tim says smiling, that is better than being heartbroken and broke. He went in search of “a new love”, and so he built Continuum. The concept was simple: to “shoot for the stars”, Tim tells me, and craft a wine that would rival Bordeaux’s First Growths – as well as continue his family’s legacy in Napa. Having seen how their family business had grown, shifted and ultimately fallen into corporate hands, he and his sister Marcia wanted to keep things simple. The first few vintages were made with fruit sourced from Robert Mondavi, largely To Kalon – vineyards that Mondavi had worked for 30 years and knew inside-out. But he knew that site was everything, and thinking of Burgundy’s best wines, he looked to the hills – keen to find his own slice of “Grand Cru” terroir. So he “kicked a lot of dirt” – and in 2008, he found something.  Up-slope from Dalla Valle, above the fog line and neighbouring Colgin, a marine biologist called Leighton Taylor had planted vines on Pritchard Hill in the 1990s. He was a wine-lover and saw the roots he put down in these rocky, volcanic soils as his retirement plan. His children didn’t share his passion, and he decided to sell: enter the Mondavis. Tim Mondavi instantly realised the potential of the site and bought the 173-acre property. Southwest-facing, with sparse top-soil and the intense sunlight that this altitude offers, he named it Sage Mountain Vineyard, after the abundant wild sage found across the property. The area had been conventionally farmed and needed work, and Mondavi brought two of his old team onto the project. Together they worked to realise the potential of these rocky 70 acres of vines, regrafting, replanting and refining the farming – drawing on organic and biodynamic practices. Gradually, they started using fruit from the site for Continuum, and from the 2012 vintage the project was exclusively estate-grown, all coming from Sage Mountain Vineyard. In 2013, they completed work on a winery on-site – meaning everything was done in-house by their own team – a first for the family. For Tim, it was a big moment. The vintage happened to coincide with his 40th harvest, as well as the 100th anniversary of his father Robert’s birth – and the label bears a dove in tribute to him, flying over the vines.  Robert was not just the patriarch of the family but of the entire valley. He passed away in 2008, just a month after Tim had shown him Sage Mountain Vineyard. He was a force of nature, who not only built the family empire but put Napa on the map, fighting relentlessly for the region on the world stage. It’s hard to imagine that he was an easy man to have as a father. “There was no such thing as too much,” says Tim. “But there was no such thing as enough.”  Robert was, Tim tells me, “go, go, go” – and it’s clear Tim wants something different for his family. With Continuum, he wanted a project that could provide a balanced life – smaller than the smallest project at Robert Mondavi. Tim’s children haven’t run away from their fate or the family business. They’ve all worked at Continuum at one point or another: sons Carlo and Dante have gone on to establish Raen, their own Sonoma Coast Pinot Noir project in 2013, while Chiara has joined her father and is firmly in situ as winemaker at Continuum.  The Mondavis might be Napa royalty, but they’re also farmers – and they’re more aware of the challenges that climate change brings than anyone else. “Mother Nature has so many ways to remind us we haven’t been taking good care of her,” Tim says ruefully. The wildfires of 2017 brought that closer to home than they’d have liked. The Continuum team was two-thirds of the way through the harvest when Tim saw the glow on the horizon from his house. He instantly called to cancel the harvest, and ensure everyone stayed far away from the winery and vineyards – but his vineyard manager ignored him and drove straight up the estate, to check that none of the crew were already on-site ahead of their early pick. Luckily the team was all fine – but those fires filled Tim with fear.  They didn’t make a 2020 vintage, so the latest release – the 2021 – is the first for two years. They’ve been gradually increasing the proportion of Cabernet Franc in the blend, and the 2021 has the highest percentage to date (representing over a third of the blend). It is, Tim says, “our finest effort” – something he attributes not just to the year’s conditions, but over a decade spent getting to know each of Sage Mountain Vineyard’s 44 blocks. “To be truly great, you have to understand the site,” he says. The wine is elegant and pure, with a saline, earthy minerality that is an imprint of the property – something that runs through every vintage. Tim’s been making wine for 50 years now, but knows that he’s in a generational business. Continuum might be his new love, but he didn’t build it for himself – it’s for his children. “Our aspirations are large enough to contain the pursuit of excellence,” he says. Ambition’s never run short in the Mondavi bloodline – but, as Continuum proves, it’s backed up by not just good instincts but the drive, grit and hard graft to make those dreams a reality. The latest release of Continuum is available now

This week saw the release of the Wine Advocate’s first report on 2016 Brunello di Montalcino, written by Monica Larner. It’s only a first look rather than full review, as – with the current restrictions on travel, some producers have preferred to hold back their samples until early
next year – so the report doesn’t include the full line-up of releases. This is the third major report to be released on the vintage in the last few weeks, following on from the Vinous (courtesy of Eric Guido) and James Suckling reports earlier in the month. All are in agreement, 2016 is an exceptional vintage. Perhaps the most exciting thing about 2016 is the huge range of excellent wines. The sheer scope and variety between them could keep a collector very happy for a very long time. There is universal agreement that the younger generation of more open-minded Montalcinesi are bringing real excitement to the region. Their impact has only become more evident in the region’s most recent yet completely contrasting vintages. 2015 showing off the fantastic concentration and fruit purity. 2016 its precision, structure and elegance. With 2017 looking like a much more difficult vintage – it’s worth making hay while the sun shines, and it has never shined brighter in Montalcino than today. 
2016 versus 2015 
For Monica Larner and Eric Guido, 2016 eclipses the hugely successful 2015 vintage. For Guido, who was a lot less taken by the 2015 vintage, there is little comparison to be made – 2016 is by far the better vintage in terms of typicity, precision and aging potential. For James Suckling, 2015 and 2016 are the best vintages ever made in the region and he is well-equipped to make such a statement, having tasted Brunello extensively back to the early 1980s. For Suckling, the 2015 just pips the 2016s to the post, but largely due to their approachability, stating that the 2016’s “intense tannins” make then a lot less accessible at this early stage. Eric Guido’s views of the two vintages are more polarised. In his 2015 report, he felt the exuberance and warmth of the 2015 vintage in the wrong hands could produce wines that were made “simple” by their ripeness, questioning their potential for “serious evolution”. He states that the 2015s do not compare with the other great modern vintages of 2004, 2006, 2007 or 2010 – yet 2016 certainly does, stating, “They are like a well-muscled black stallion in its prime. They are dark yet radiant, expressive, nearly explosive at times, yet pure, poised and structured… I frankly cannot remember the last time I tasted young wines from Montalcino that possessed such symmetry from start to finish.” Monica Larner feels there is less between the two vintages when it comes to quality, although she admits a personal preference to the style of the 2016s, stating. “I prefer the classic purity and linearity of the slightly cooler 2016 vintage to the more exuberant and texturally generous wines from the warmer 2015.” She actually believes the 2015s generally are “more even keeled” than the 2016s, where the “transparency” of the vintage has exposed both the highs and lows of the vintage. Despite this, she believes the power and elegance is greater in 2016 overall. Although too early in the wines’ evolution to directly compare with the 2010s, she believes it certainly is up there in terms of quality in the best examples. For James Suckling, it is the consistency of quality that marks out a great vintage – and both 2016 and 2015 tick that box: “I learned a long time ago as a wine critic that great years are years when everything is outstanding from the lesser-known properties to the most prestigious ones. The 2016 and 2015 vintages certainly achieved this, making this pair of years the greatest ever for Brunello di Montalcino.” He concludes that 2016 Brunello is the ideal vintage for laying down and enjoying over the long term, whereas 2015’s open-knit style makes them already approachable and enjoyable now.  

 The rise of the crus Larner makes the points that 2016 has certainly been a vintage that has showcased the rise of the Crus in the region, with many of her favourite wines coming from single vineyards. Most notably, she awarded Il Maronetto’s Madonna delle Grazie 100 points, but also Casanova di Neri’s Cerretalto and Tenuta Nuova both featuring in her top 10. A winery that has championed the concept of single vineyards in Brunello since the early days, first releasing the Cerretalto with the 1981 vintage. Eric Guido believes that this is still early days for the region’s Crus and we should expect many more over the coming vintages, with many producers registering names for future releases. The fact that all the top Crus in 2016 – Ciacci Piccolomini d’Aragona’s Pianrosso from Castelnuevo dell’Abate, Casanova di Neri’s Crus from Canalicchio and Il Maronetto’s Madonna delle Grazie from central Montalcino – are situated in very different parts of
Montalcino bodes well for the potential and variety set to develop as more producers start producing single-vineyard wines. Eric Guido points out that to produce a Cru wine, by law producers must reduce their yields from Brunello’s nine tonnes per hectare to seven. This means that these single-vineyard wines are about more than just terroir, the lower yields adding more intensity and concentration to the wines. Larner says, “Over these past six years, there has been a significant shift to
single-vineyard and so-called “Selezione” wines. This signals an important change in perspective and illuminates the very way the ilcinesi see themselves: not as a monolithic wine region but as a complex and fluid assembly of various moving pieces and parts. This self-awareness is key to Montalcino’s future success in an increasingly competitive marketplace.” 
Top-rated wines There’s no shortage of high scores this year – and many are already on the market. Here’s a short-list those that are well worth looking out for. Casanova di Neri Few producers have been so universally well scored than the single vineyards of Cerretalto and Tentua Nuova from Casanova di Neri. The Cerretalto 2015 Riserva being awarded 100 points from Suckling and 98+ points from Larner. Their Tenuta Nuova 2016 awarded 97+ points from Larner, 96 points from Guido and 99 points from Suckling. Their wines remain some of the most seductive and complex and consistent of the region. Poggio Antico Poggio Antico in terms of price-to-quality ratio also seemed to fare very well across the critics. Although the Altero might not be for the traditionalists, it is an outstanding wine and both their 2015 Riserva and straight 2016 Brunello are exceptional. Altesino Altesino’s straight Brunello, priced at just £185 per case of six in bond and awarded 95+ points from Larner, seems an absolute steal. Giodo Carlo Ferrini’s Giodo was also a fantastic hit for both Suckling (100 points) and Larner (98 points). Larner described it as a “career-defining wine from this proud Sangiovista”. With just over 800 cases produced, it will be a rare find in years to come. Gianni Brunelli Gianni Brunelli’s wines have been remarkably successful in 2016 and remain well-priced for the quality, although availability will likely become difficult, particularly for their Le Chiuse di Sotto, which Larner awarded 100 points – the only 2016 wine other than Il Maronetto’s Madonna delle Grazie to receive a perfect score. Riserva is well worth seeking out. Other great-value buys include Baricci, Livio Sassetti, Il Poggione and Castiglion del Bosco – all of which received glowing reviews

Brunello 2016: what the critics are saying

Barolo remains the most important region in the world for Nebbiolo. This variety is one of the world’s most sensitive and difficult to grow, rarely found outside Piedmont. While there are a handful of other high-quality enclaves across Piedmont including Valmaggiore (24km north of Barolo) and the cooler sites of Gattinara and Ghemme – collectively known as Alto Piedmont (or Alto Piemonte), nowhere else matches Barolo and neighbouring Barbaresco for complexity and ageing potential.  The wines are typically pale ruby in colour with grippy tannins, high acidity and a flavour profile of red cherry, mulberry, camphor and rose petal. The grape’s almost transparent character (similar to Pinot Noir) makes it a great transmitter of terroir – producing many nuanced styles, flavours and aromas – from the most delicate and floral to the most structured and mineral, and everywhere in between. It is this complex variety within such a small region that makes the grape, and the varying communes of Barolo, so interesting. Barolo has a cooler microclimate compared to nearby Barbaresco, resulting in a longer ripening season. While this means it is more sensitive to vintage variation, in the best years the wines reach highs unmatched anywhere else. Dry Barolo has been produced in the region since the mid-1800s. A wine that was a favourite amongst the aristocratic families of the Savoy dynasty, it is thought to have been first produced in this style by King Carlo Alberto’s estate in nearby Pollenzo. The aristocracy bankrolled wine production in Barolo, helping the pioneering winemakers at the time – such as Staglieno and the French oenologist Oudart – improve the quality and reputation of the wines. Their aristocratic link earned Barolo the nickname “the king of wines and the wine of kings”. Understanding the variety of styles of Barolo to a large extent depends upon where the grapes are grown. The landscape of Barolo is made up of many small undulating hillsides where exposition, topography and altitude all play important roles in the final character of a wine made in a specific part of the region or vineyard. Historically the sub-regions were not so important, largely due to the fact that Barolo wines existed exclusively as blends of fruit from across the region (often including grapes from the vineyards of Barbaresco). The 1961 vintage, however, represents a significant turning point when both Prunotto and Vietti released single-vineyard Barolos from Barolo Bussia and Rocche di Castiglione. While it was common knowledge amongst the local grape brokers which parts of the valley produced the best Nebbiolo, it wasn’t until the 1970s when these place names first came to print in Luigi Veronelli’s map. At the most basic level Barolo is divided into two valleys: the Central Valley and the Serralunga Valley. The Central Valley – including sub-regions of La Morra, Barolo and Novello – produce a more approachable style, noted for their fragrance and elegance, thought to be due to the distinct blue-grey marl content in the Tortonian soils found in these vineyards. The Serralunga Valley – with its sub-regions of Serralunga d’Alba and Monforte d’Alba – tend to create more powerful, tannic, concentrated wines due to the higher content of clay, limestone and sandstone found in the Serravalian soils. In Castiglione Falletto there is a richer concentration of sandstone and this is generally thought to produce a middle ground between the more structured character of the Serravalian soils and the elegance brought about by the Tortonian soils.  While these variations in soil throughout the sub-regions play some part in the differences in the structure and flavour profile of different Barolos, this is just one factor and should be understood as broad generalisations. The complex terroirs are defined not just by the soils, but by the varying expositions, altitudes, viticutural techniques, clones, pruning and winemaking methods which vary from estate to estate – making it impossible to provide a completely definitive profile of each area.    
A guide to Barolo's communes  There are 11 village communes within the Barolo DOCG: La Morra, Barolo, Castiglione Falletto, Serralunga d’Alba, Cherasco, Diano d’Alba, Grinzane Cavour, Monforte d’Alba, Novello, Roddi and Verduno. Below you’ll find a guide to the distinctive style of the main communes, as well as the best growers from each.  La Morra Wines from La Morra can be some of the most perfumed Barolo, typically with soft, smooth tannins. It is believed that the fine sandy soil of the region is behind the wines’ elegance. As the largest Barolo subregion, however, La Morra is the most diverse both in style and quality. Typically, these wines can be much more approachable in youth and tend to fair better in cooler vintages. Top producers in the region include Roberto Voerzio – who makes a unique style for the region, with strict pruning leading to miniscule yields and austere, tannic wines with long ageing potential. Poderi Oddero is more typical for the commune, producing bright, fruity Barolos with distinctly elegant tannins. Elio Altare is known for more modern-style Barolos which are matured both in traditional large barrels, as well as smaller barriques, and some new oak for their single-vineyard wines. Top vineyards: Brunate, Cerequio, Rocche dell’Annunziata Barolo Similar to La Morra, the Barolo sub-region produces broad, open, velvety Barolo but often with a bit more structure and concentration than those from La Morra. The region is home to some of the most historic sites, including Cannubi – a Cru that was singled out as an exceptional site even before the creation of the Barolo appellation (with the earliest bottled example of this site dating back to 1752). It is also home to some of the most respected producers in the region, who make markedly different styles of Barolo – further confirming that location is only part of the puzzle. Fierce traditionalists Bartolo Mascarello famously don’t make single-vineyard wines but their blended Barolo remains one of the region’s finest. Luciano Sandrone is more modern in style, the wines made in an elegant style that is more approachable in youth but also offers fantastic ageing potential – making them some of the region’s most collectable. Top vineyards: Cannubi, Ravera, Bricco delle Viole Castiglione Falletto  Although situated in the Serralunga valley, Castiglione Falletto falls somewhere in the middle between the elegant and fragrant qualities of La Morra and Barolo, and the boldness and concentration of Serralunga and Monforte. This is due to the aspect of the best slopes here, where the vines have maximum exposure to the sun, meaning riper fruit and added concentration. Giuseppe Mascarello produces one of Barolo’s most famous single-vineyard wines from the Monprivato Cru. Traditional in style, the wine is fermented in tank and aged in large oak. Vietti – a true pioneer of single-Cru Barolos – is also based here, as it has been since the 1800s. This estate has not only some of the best label designs in the world, but access to some of the finest Crus in Barolo, including Ravera, Rocche di Castiglione and Brunate. Top vineyards: Rocche di Castiglione, Fiasco, Villero Serralunga d’Alba  Serralunga is defined by its high concentration of Sant’Agata soils. Growers here talk about the vines feeling pain, as the harder soils put more stress on the vine, producing wines of great depth and power – as well as some of the highest tannin levels and the most full-bodied Barolos of any region. The wines can often have a distinctive bitter orange aroma. The wines are solid and typically austere, but can also be incredibly elegant and expressive, some of the most terroir-driven and long-lasting Barolo. By far the most famous and revered wine from Serralunga is Giacomo Conterno’s Monfortino. Monfortino was in fact the first ever producer-named Barolo made in the Riserva style, with the first vintage made in the 1920s (today it comes from the Cascina Francia Cru). Although based in Barbaresco, Bruno Giacosa produces two of Barolo’s most revered wines from the Serralunga Cru of Falletto, released only in top vintages. These are two of the most consistent expressions of top single-vineyard Nebbiolo in Barolo. Top vineyards: Cascina Francia, Falletto, Ornato Monforte d’Alba Defined by concentration and structure, the soils in Monforte d’Alba contain more clay than limestone – the opposite of Serralunga. The resulting wines tend to have more volume on the palate and boldness, making them the most concentrated Barolos. The wines exhibit classic rose petal, clay pot, clove, camphor and cardamom aromas, and particularly bold tannins. Look out for bottlings from Elio Grasso whose Case Matè Barolo comes from Ginestra. Bussia is one of the most famous, but also largest Crus, producing many different styles. The best part of the vineyard is Upper Bussia; a natural amphitheatre with varying expositions, when combined it produces wines of fantastic complexity. The remote Hebridean isle of Islay has an almost otherworldly quality about it. For centuries, this eerily beautiful and beguiling postage stamp of Scotland produced whiskies that elevated some of the world’s most well-known blended malts. In recent years, however, Islay has stepped out from the shadows and become one of the most lauded single malt regions in the world – a position cemented this month when a cask of Ardbeg sold for a record-breaking £16 million.   So just how did this small whisky-producing region become the most collectable name in the world?  Adam Hannett started working as Head Distiller at Bruichladdich, on the southwestern tip of the island, in 2006. He says the difference between Islay, and Islay whisky, then and now is “pretty transformative”. When he joined Bruichladdich, the Victorian distillery was six years into what would become one of the greatest distillery revivals the whisky industry has ever seen.   “Inside the distillery gates, we were at the beginning of our journey,” the Head Distiller tells me. This journey included distilling an organic spirit, running barley experiments and bringing barley-growing back to Islay. The latter, Hannett says, has “changed the landscape of the island completely”. He adds: “Gordon, our Assistant Distillery Manager, talks about how we’ve turned fields golden, which sounds a bit cheesy, but it’s true.”  Journey due east and you’ll find Bowmore – Islay’s oldest and one of its most coveted single malt producers located in the island’s capital. David Turner, who was born and raised on the island, has worked at the distillery for 30 years – for the past 10 as Distillery Manager.   “Thirty years ago we were producing a lot of our spirit for bulk, for blending purposes, and we had a few thousand tourists a year,” he tells me. “We probably had one full-time visitor centre manager and a couple of seasonal tour guides that would come on for the summer.  “I think we’ve now got nine full-time staff in our visitor centre who do tours all year round and we’ve moved away from bulk blended whisky to just being a single malt specialist now.”  During Turner’s career at Bowmore, the distillery has transformed from a lesser-known producer to one of the most collectable names in Scotch whisky. Black Bowmore, Turner says, “put us on the map for being collectable”.  “When we took these samples out the casks, the whisky colour was black,” he says, “the quality was phenomenal.”  This discovery was made in the 1990s, around the same time as the wider whisky world started to take notice of Islay after whisky writer Michael Jackson shone a spotlight on the island’s quality in his pivotal work, Complete Guide to Single Malt Scotch.   As a region, Islay has faced hardship and several distilleries have been temporary or permanent casualties. Port Ellen, one of Scotland’s so-called “Holy Trinity” of lost distilleries, is arguably the most well-known victim, closing its doors after the downturn in 1983. Ardbeg was also shuttered in 1991 and was saved by the grace of God (Glenmorangie) in 1997. Today, the region is booming and the number of producers has reached a healthy nine. This number will increase when Port Ellen is resurrected by owners Diageo imminently – an announcement met with unfettered excitement last year. These closures and shifting paradigms have created a thrilling market for collectors, as whisky enthusiasts search for bottlings from bygone eras. The 1950s through to 1970s is of keen interest as whisky was being produced on a much smaller scale via traditional methods.  Traditionally, Islay was associated with peated whisky. For a time, distillers like Laphroaig, Lagavulin and Ardbeg competed against one another to see who could produce the biggest peat bombs on the market, which divided opinion. Bruichladdich blew all the others out the water when it released Octomore 6.3 in 2015, which registered 258 phenol parts per million (the scale used to determine the peat levels of whisky). For context, prior to that release, the highest peat levels were circa 167 PPM, also from Bruichladdich.   “I think there’s a hugely diverse range of flavour in the whiskies being produced across Islay at the moment,” Bruichladdich’s Hannett tells me. “It makes defining an ‘Islay’ whisky quite challenging as there’s so much variety from one distillery to the next.   “The general public almost expects a heavy smoke, almost medicinal flavour from an Islay whisky but even within our heavily peated Port Charlotte range, we have quite a soft, heathery, barbecue smoke.”    “Islay is famous for its peated whiskies but Bowmore is not all about peated,” Turner adds. “Bowmore sits in the middle of Islay. The north of Islay is very, very lightly peated. The south is very heavily peated. We’re in between the north and the south in peating levels. We see ourselves, and call ourselves, mid-peated, or a perfectly balanced Islay whisky.”  The people of Islay – Ileachs to give them their proper name – are integral to the whisky industry on the Hebridean island. Many of the Master Distillers and Blenders are locals and the vast majority of the production team hails from the island with an average population of 3,000 people. One of the most famous Ileachs is Jim McEwan who started his career at Bowmore, where he later worked as Distillery Manager before he left to lead Bruichladdich’s resurrection in 2000. McEwan came out of retirement to spearhead independent bottler Hunter Laing & Co’s new £12 million Islay distillery, Ardnahoe, saying it was an offer he could not refuse and beyond his wildest dreams.    The distillery, located on a four-acre plot on Islay’s northern coast, between Caol Ila and Bunnahabhain, overlooking the Isle of Jura, became the ninth working distillery on the island when it opened in 2019. McEwan designed the pot stills, mash tun and mucked in with every aspect of production to create a new-make whisky that he says is everything he looks for from a classic Islay: fruit, flower, sweet notes from the mash tun, baked cereal notes, smoky flavour from the peat, and bracken, heather and wild plants from the bog land. McEwan says the spirit he’s produced at Ardnahoe is as good as anything he’s tasted in 56 years.    Islay is at an interesting point in its history. New distilleries are opening, lost names are coming back to life, and many of the old guard are reaching retirement and are being replaced by younger distilling talent. There, arguably, has never been a more interesting time in its whisky-producing history.    Hannett, who is on the younger side, says: “I’m excited to see how distilleries can continue to adapt to support the local community. We’ve got a special thing here, with a booming industry and nine working distilleries.”  Turner picks up the point: “It’s good to see the old distilleries are still thriving. The new ones have got a good future as well but they’ve got a good number of years before they get a good standard core range." He adds: “A good Islay whisky I would say is between 12, 15 to 18 years. So they’ve got a good few years to get to that, never mind becoming collectable.”  Turner has quietly been amassing a collection of his own since the early 1990s. “I was in since the very beginning,” he says. “I was lucky to be in at the right time and I’ve got a big collection. It’s not just quantity or some of the new releases. It’s old and rare and quality I’ve based mine on.”  Initially, Turner collected Bowmore and slowly started adding other Islay and Scotch limited releases to his collection. As interest in whisky grew, the Distillery Manager rejigged his collection to focus on Islay malts – at one point exclusively Bowmore, Laphroaig and Lagavulin. After a period of selling certain bottlings to buy other, more expensive ones, Turner now has an exclusively Bowmore collection. He doesn’t elaborate on this but he does add: “Aye, it’s got smaller but it’s got more quality and rarity attached to it.” One suspects it is quite something to behold.  As for his distillery, Turner says Bowmore has got “good quality stuff maturing” and “some good aged stocks”. “We were family-owned up until 1994 and the family and the directors at the time had good insight. They kept good aged stocks, so we’ve got good 30s, 40s, 50s – 51, 52-year-old whisky – maturing. When it comes to whisky, the conversation has long been dominated by maturation – on how long the liquid spends slumbering in which cask, on how big the cask is and what it held before, whether a Sherry butt, wine barrique, first-fill Bourbon barrel or the fashionable mizunara. Recently, there’s been an increased focus on the base product, with producers such as Waterford’s Mark Reynier championing single-site, single-barley, terroir-driven whiskies (and rums, with his Renegade project). But, somehow, there’s a tendency to skip on by the magic that happens in between: distillation.  While grain whisky is column distilled, malt whisky is almost exclusively distilled in copper pot stills – indeed, it’s a legal requisite for Scotch whisky. Crafting these copper beauties is an art – and one that depends on a handful of specialists. Kentucky has Vendome, Germany has Kothe and CARL, Italy has Frilli and Scotland has Forsyths. The equipment these coppersmiths produce lays the foundation the DNA of its new-make.  To the untrained eye, these onion-shaped pieces of kit look almost identical, but the size and shape is distinct to each distillery – defining its style. As distilleries expand and increase production, they don’t buy a bigger still – but commission exact replicas of their existing still(s), with every dent and dimple carefully recreated. Macallan, famously, replaced all its stills when building its new state-of-the-art distillery in 2018, asking Forsyths to create 36 stills that were identical to those it had previously used.  Although there have been attempts to use other metals, copper has long been favoured for distilling – originally for its pliability, making it easy to work and shape. But by the early 20th century, it was apparent that copper had other benefits – stripping the spirit of impurities. As the vapour rises through the still, it reacts with the copper, capturing sulphur, cyanides, carbonates and acids, meaning the liquid that is eventually collected is purer. Coppersmiths play on this purifying effect to create a range of stills, for the longer the vapour spends in contact with the copper, the lighter the spirit you’ll produce. Take Glenmorangie’s tall, 17-feet-high stills which produce a very light spirit, and compare them to the small, squat stills and typically heavy spirit of the Macallan. Of course it’s not quite as simple as that. As well as the ratio of copper to liquid, the speed of distillation, the shape of the still, the size of the neck, the level of reflux, the angle of the lyne arm and venting of stills all have an impact.  Rothes-based Forsyths has been hammering copper into shape for Scotland’s leading distillers for over 150 years. Richard Forsyth OBE (who has now passed management of the business to his son, Richard Jr) was the third generation of his family to run the coppersmiths. The frank, self-effacing Scot remembers working in his father’s workshop aged 15, “I knew this is what I wanted to do… I found it fascinating.” And after 55 years, his eye still twinkles when he talks about the arch of a still’s swan neck, the art of wielding a planishing hammer and the characters that make the industry so interesting.   He joined the family business in 1967 – at what happened to be a pivotal moment for the industry. During the Second World War, the whisky business ground to a halt – and with it the need for stills. In the 1950s and ’60s, however, the industry grew rapidly – too rapidly, it turned out. What was a golden era turned into a whisky lake, with many distilleries soon mothballed. Forsyths – for whom 99% of its business was servicing the whisky industry – had to find something else to pay the bills, and it was up to Richard to find that something else. They branched out first into paper, then stainless steel and – by the late 1990s – oil and gas. Although coppersmithing remained the foundation and heart of the business, these other disciplines became the main money-makers until the early 2010s, when whisky’s current boomtime set in. Today, Forsyths maintains over half of the pot stills in Scotland. For a wash still (distilleries that double-distil have wash and spirits stills, first distilling the wash into “low wines” and then distilling the “low wines” into new-make spirit), the head, neck and condenser wears out in eight to 10 years, while the pot itself may last 25. Add to that developing new stills for the thriving industry – as well as their expansion into rum, Bourbon and tequila – and the company’s not short of work.   Although there is clear resistance to change with an industry that is entrenched in tradition, things have shifted, slowly but surely, over the years. And there have been two significant changes over the last century that have transformed the Scotch whisky world: the firing of stills and the nature of condensers.  When shell-and-tube condensers were invented in the 1880s, as an alternative to old-fashioned worm tubs, it took time for producers to be persuaded. Although shell-and-tube condensers are significantly more efficient and take up much less space, they are completely different – with the copper surface area at least 20 times larger, something which has a key impact on the spirit. To this day some producers (15 to be exact – including Craigellachie, Mortlach, Glen Elgin and Springbank, the latter only for their wash still) retain their worm tubs, valuing the heavier, richer, more complex (and in some instances, even meaty, savoury) spirit character.   Traditionally stills were direct-fired – heated by flames fed by peat, coal or gas. “It’s dirty, messy, difficult to handle – and to control,” Forsyth tells me. A push for safety and efficiency saw producers switch to using steam in the 1970s. But some argue that this shift wasn’t for the better. Fire created a less consistent heat, with hot spots that would burn the wash and promote Maillard reactions (the same reaction that takes place when you brown meat, or during the bottle-ageing of Champagne or other traditional-method sparkling wine) – adding nutty, roasted notes that build complexity, or so proponents would argue. Glenfarclas is known for having briefly dallied with steam before returning to direct-firing, along with the likes of Macallan, Glenfiddich and Springbank.  As the whiskies of this pre-modernisation era – Scotch’s so-called “golden age” – become increasingly coveted, distilleries (both new and old) are looking to recreate these practices. Along with traditional floor maltings, producers like Glen Garioch (owned by Suntory) and Dunphail are investing in direct-firing. (Although, with worm tubs no longer produced, new distilleries have little choice regarding shell-and-tube condensers.)  However they are fired, given their custom nature, copper pot stills don’t come cheap. Much of the work continues to be done by hand, hammering to strengthen and finish the copper. Stills can range from 5,000 to 50,000 litres in capacity, but an average 15,000-litre still and its condenser will require between 1,800 and 2,000 manhours, and set you back around £250,000. And that price has only increased recently, thanks to rising energy and material costs – with a copper shortage proving challenging for Forsyths, a business that is the UK’s second-biggest buyer of the metal.  With the distinct nature of stills and their impact on spirit, plenty of new producers will ask for copies of a particular distillery’s stills – wishing to emanate their style of spirit. Forsyth tells me how one Japanese customer requested a pair each of Macallan, Glenlivet and Glenrothes stills. While of course there are many problems with this imitation game, there’s also no guarantee – as Forsyth tells me – that the same equipment will have the same results, especially when not run with the same wash, in the same way, by the same people. And, of course, a company like Forsyths isn’t going to give away Macallan’s proprietary designs, for example. As such, they’ll recreate something similar, but ensure it’s tweaked so no two distilleries have exactly the same design.   But how much impact do stills really have on the final spirit? Despite his half-century in the trade, Forsyth is quick to suggest, “I don’t think a lowly coppersmith can talk too much about that.” He’s clear that you need good equipment to make good spirit, but it’s one factor in amongst everything else – the barley, water and fermentation times, for example. And how a still is used is as important as its shape or size, with both the speed of distillation and the all-important cuts – dividing the heart from the foreshots and feints. Forsyth firmly believes that good wood is “the single biggest effect in a bottle eight, 10 or 12 years later”. There’s little use having a good base spirit if it’s ruined by a decade in bad oak – but good oak also can’t salvage bad spirit.  Forsyth has seen it all during his 55 years in the whisky business – and has been forced to be as malleable as the metal his family has worked for generations to survive the booms and busts. Despite the challenges, the coppersmith is as enchanted by his trade as when he first picked up a hammer in his father’s workshop. The industry will doubtless continue to ebb and flow, but with a spirit that takes decades to produce, the pace of change is reassuringly gentle. “It almost goes as slow as the running of the spirit,” Forsyth says whimsically. The still room remains the beating heart of distilleries – the basis of a producer’s fingerprint, all thanks to the careful hammering of the artful coppersmith.  Browse all current Scotch whisky listings or read more about spirits  

There’s something romantic about the bulbous sheen of a copper pot still. These behemoths glimmer with the promise of fine spirit – but it’s rare that we talk about what happens within. Sophie Thorpe sat down with Richard Forsyth OBE of Scotland’s leading coppersmiths, Forsyths, to find out more

Truffles: small, gnarly things. Equally ugly and alluring. Pungently intoxicating. Deliciously rare – and undeniably expensive. Alexandre Dumas described truffle as “the holy of holies”. Rossini called it “the Mozart of mushrooms”. Jean Anthelme Brillat-Savarin said just the name “awakens erotic and gastronomic ideas”. There’s something magical about the way these funghi lie just out of sight. The elusive treasures lurk beneath an otherwise unassuming forest floor, found only with the help of a specially trained hound. Once unearthed, however, they become the centrepiece to the world’s most expensive dishes, prized by Michelin-starred chefs and gourmands alike. They aren’t just another ingredient, however, there’s theatre to their presentation: the stage set in the kitchen, then served with a flourish tableside. For Rowan Jacobsen, author of the recently published Truffle Hound, one sniff was enough to keep him on the trail for three years. The Vermont-based writer was in Barolo in 2018 and on his way to the table, when he passed a giant white truffle under a glass cloche. Instinctively he lifted the dome: “I didn’t even make it to the table. Such a crazy smell. I was destroyed at the luncheon – I kept thinking about the truffle,” he tells me. That one flare of the nostrils had him hooked, and he’s been following truffle hunters around Europe ever since. His book follows his adventures – discovering “dreamers, schemers, and some extraordinary dogs” along the way. Piedmont is considered the home of the truffle – with the annual fair in Alba (running from October to December) the epicentre of the trade. White truffles (tuber magnatum), as found in Alba, are the crème de la crème of the truffle world – distinctly seasonal, flourishing in the autumn and winter. This brief window of opportunity is key to their appeal. As Donald Edwards, Head Sommelier at La Trompette, says, “What else can you have where the stopwatch of deliciousness is literally ticking by the table?” Of course, not all truffles are created equal. Black truffles are a third or a quarter of the price of white truffles and offer a very different aroma. Jacobsen describes “more pungent, more overwhelming” and “invigorating” scent of white truffle as “garlic, salami, almost gasoline” versus the “comforting, soothing, round” notes of “cured olives, cocoa and hazelnut” that he associates with black truffles. And while there is only one white truffle, there are two types of black truffle: the black winter truffle (or Périgord, tuber melanosporum, now mostly grown in Spain) and the black summer truffle (tuber aestivum, sometimes known as the Burgundy truffle but found all over northern Europe, including southern England). The latter, more widespread breed is not nearly as intense as its winter sibling, meaning more is needed for the same impact. One reason that white truffles carry such a premium is also that they have – so far – proven impervious to cultivation (although scientists in France have recently claimed to have cracked this). The truffle hunters, or trifulau, in Piedmont are therefore unsurprisingly secretive about where they find their treasure. Often speaking only a local dialect, these foragers roam the woods – often under the cover of darkness in search of “white gold”. Their dog will sniff their way to the right spot, pawing the ground and patiently waiting for their master to dig up their bounty. “It’s a billion-dollar industry totally dependent on dogs’ noses,” Jacobsen says, laughing at the absurdity. While the hunters might avoid the limelight, it’s not the case when it comes to their dogs, Jacobsen tells me. The canine connection is taken to the next level when you also depend on a four-legged friend for your livelihood. While pigs were the original snouts charged with sniffing out truffles, hunters switched to dogs in the 17th and 18th centuries. Lagotto Romagnolo is the “traditional” truffle-hunting breed (and comes with an associated premium, given their potential return), but today almost any dog is used. They simply need to be trained and have the right nose for the job. “Good ones are amazing,” Jacobsen tells me. “They can find a truffle 50 yards away in the forest and they just know it’s there.” Trifulau Luigi Rosso has been – along with his dog Danko (aged seven) – sniffing out the good stuff for 30 years. While it might look easy, he says that it’s incredibly difficult and can be dangerous for both hunters and their dogs, traipsing through forests in the dark. It is, however, all worth it for him. “The tranquillity that is in the air while you go for the truffles. The moon, the silence and only the sound of your footsteps on the damp leaves, then the joy of your dog when it finds one…” he tells me. The unique scent of truffle is what drives connoisseurs to seek them out – bidding on the finest examples for extortionate sums. “I feel like they've evolved to hit some deep pleasure receptors in our brains. When they're good you just want to luxuriate in them,” Edwards says. William Lowe MW – the man behind Cambridge Distillery – set about capturing the elusive flavours of truffle in his quest to create a digestif-style gin. The idea was born when looking at the digestif trolley in a Michelin-starred restaurant – and a sommelier who was scornful at the idea of a gin worthy of joining its ranks of fine Cognac and single malt whisky. “If you look at those rare and mature examples, you’ll see that the oxidative maturation process creates these beautiful earthy aromatic profiles sometimes referred to as ‘forest floor’. We wanted to achieve this profile through distillation rather than maturation, and truffles gave us the perfect route to do so,” Lowe says. “It took me a very, very long time. Because truffles are hard to deal with. They are packed full of volatiles, which is to say that truffles smell more than they taste,” the Master Distiller explains. “If you think it through – every time you open a door to a restaurant that is serving truffles, bang you get it straight away. But if you look at the food they serve truffles on and it’s always almost neutral dishes: creamy pasta, mushroom risotto. It’s never on super flavoursome dishes because if it is, you can’t taste the truffle anymore.” The challenge, however, was capturing something that doesn’t want to be caught, and finding the right level of truffle. “With truffle, chefs will normally do one of two things: either they’ll know you know it’s expensive so they’ll use loads of it so you can’t taste anything else for the rest of the meal – or they’ll do the opposite. They know that you know it’s expensive so they use so little that it’s the Emperor’s new clothes – you sort of have to search for it. It takes a genuinely skilled chef to use truffle well. And using it well is when you get all of that amazing aroma but you can still taste the other things.” This was what Lowe was aiming for – but it wasn’t easy. He spent months refining the distillation technique for truffle, but the flavour was only “ok”. He went back to the drawing board and decided that the problem was the truffle he was using – black wouldn’t cut it. “We went straight to Piemonte – white truffles from Alba. Gram for gram, worth more than gold […] and it came out and tasted a lot better than gold does so that’s an easy trade,” says Lowe. For trifulau Rosso, you need at least 10 grams on a dish (whereas, he says dismissively, restaurants will often only use a measly five) – with homemade tagliarini top of his list, although he also suggests trying it on panna cotta. He considers Pelaverga – a rare red variety that’s native to Piedmont – the classic pairing, but otherwise goes for one of the region’s other reds, Barbera, Barbaresco or Barolo. These are undoubtedly the classic pairings, following the simple rule of what grows together goes together. However, Jacobsen or Edwards don’t agree. “It couldn’t be more wrong. It really requires a white. The tannins clash with the aromatics,” Jacobsen says. The truffle specialist opts for Champagne, white Burgundy or cool-climate Californian Chardonnay – even Beaujolais. As for Edwards, he likes something that plays on the delicacy’s textural quality: “They work so well with buttery, umami-laden cheese sauces that I can't not want really classy Chardonnay. I want bâtonnage, I want really expensive but underplayed oak and I want ripeness with a gimlet-eyed stare of terroir behind. Basically, Burgundy, Mornington or the best of the Santa Rita Hills (I'll accept that other places also make perfect wines for this), plus if I can have a few years in bottle to build that sous bois flavour connection then all the better.” At the time of writing, we’re in the midst of the 2021 truffle season – one that has brought eye-watering prices. The hot, dry summer in Piedmont (unlike the wet conditions experienced in northern Europe) has led to a tiny crop – some say the smallest in history, driving prices up. Bloomberg has declared it “The Great White Truffle Crisis”. The white truffle needs such specific conditions that climate change, and – as Rosso tells me – the warmer autumns in Piedmont, pose a serious threat. While we consider Alba the spiritual home of white truffles, today most come from elsewhere. Both Central Italy and Le Marche, but also Romania, Serbia, Croatia and Hungary are all now hotspots for truffle hunting. Many of these regions are benefiting from the shift in climate, now having the ideal conditions to nurture the rare tuber magnatum. As for black truffles, the summer variety can now be found as far north as Sweden, but drought conditions mean that irrigation is becoming essential for existing orchards. Beyond climate, there are other challenges. In Piedmont, there are fewer forests than there once were, with more profitable vineyards replacing woodland (another reason that hunters are looking elsewhere). Also, the local trifulau are – in general – an ageing group. One truffle hunter, Carlo Marenda, has established a non-profit, Save the Truffle, to try and protect the region’s truffle hunting heritage – both by passing on the tradition to younger people and protecting the forests, nurturing the right environment for truffle growth. “It used to be that these forests were very actively used by farmers, peasants – fallen wood for firewood, leaves for animal bedding etc. So forests didn’t have a lot of undergrowth,” Jacobsen explains. “But then the world changed.” With the forest floor not being cleared, decaying matter acidified the soil – something that truffles hate. Truffles thrive in high pH soils, which is why they’re found on beds of limestone. To ensure the forests provide a welcoming home for the tubers, it’s essential they’re managed correctly. While there are certainly challenges to preserving the truffle’s place in Piedmont, the good news for gastronomes is that these tubers aren’t disappearing – just moving. After three years on the trail, Jacobsen is as enchanted by truffles as when he began. But he’s less keen on the hierarchy that comes with them. There are, he says, plenty more species of truffle beyond those currently on the market – but hunters can’t sell them, so keep them for themselves. He hopes the truffle culture will shift to grassroots foraging, rather than “waiters in tuxedos grating your precious morsel over your pasta”. However it reaches your table, it’s clear that the truffle holds a special allure – and the transience of its elusive scent, fading with the seasons, is what keeps us on the hunt.
