Jaime Araujo’s surname is a familiar one to Napa collectors. Her parents Daphne and Bart purchased the famed Eisele Vineyard in Calistoga in 1990 and established their eponymous winery on the site shortly after. Jaime was enrolled in university at the time and wouldn’t join her parents in Napa for many years, instead spending over two decades studying and working in Europe, including a stint at Moët Hennessey. She arrived in Napa in 2012 to work alongside her parents as a business consultant, but the job was short-lived, when the winery and Eisele Vineyard was sold to Artémis Domaines (the parent company of Ch. Latour) in 2013.   While her parents went on to establish Accendo Cellars, with Jaime and her brother as partners, the itch to build a business of her own only grew stronger. “I always wanted to run a business as a force for good,” she recalls. She got her chance during the first vintage at Accendo in 2013, when she turned a Cabernet Sauvignon lot that didn’t quite fit in with any of the Accendo cuveés into her first 300 cases of Trois Noix wine. (The name – French for “three nuts” – is a cheeky reference to her two children, as well as her brother’s daughter, all quite young at the time.)   Despite her family’s legacy, and perhaps the temptation to enter the market at the top end, as many newcomers do, Jaime was intent to create wines that were approachable and embodied sustainability ideals. This included a pricing strategy that skewed heavily towards affordable options, ranging from $30-50 per bottle and the most expensive Cabernet Sauvignon topping out at $150. “I’m not in this to make billions,” she laughs. “It’s so important that Napa is accessible to as many people as possible. You have to be welcoming and make wines that appeal to everyone.”    Even before Jaime was developing her brand, Steve Matthiasson had been quietly establishing a reputation as one of Napa’s most respected organic winegrowing experts. After studying horticulture as a graduate student at the University of California Davis, he launched his wine career in 1995 as a viticultural consultant, going on to settle in Napa with his wife Jill Klein Matthiasson in 2002 and building an impressive client roster. Since 2007, Steve has worked closely with the Araujo family, first for Eisele vineyard – where he continues to consult – as well as at Accendo. Other current and past clients include Dalla Valle, Spottswoode and Chappellet.   The process of becoming a winemaker in addition to viticulturalist, however, has been a slow and steady process. Matthiasson says he learned about wine almost by osmosis over the years, sitting in on client tastings and by keen observation. In 2003, Steve and Jill produced just 120 cases under their name, but by 2017, they reached a major milestone with the purchase of a small winemaking facility and neighbouring vineyard in the Oak Knoll AVA – a massive accomplishment for two outsiders with little initial capital. Last year, their production reached 12,000 cases, stretched across 25 unique cuveés. Today, Steve farms most of the vineyards he makes wine from, including a small vineyard at his home, where he has planted rows of northern Italian varieties, including Refosco, Ribolla Gialla and Schioppettino.   Inside the compact Matthiasson winery, cosy by Napa standards, foudres line the walls and nearly every inch is occupied with equipment, case goods and barrels. In the corner, a stack of large glass jars filled with liquids of varying colours sits – the aromatics steeping in alcohol for vermouth, Steve explains, which he and his wife make along with olive oil and jam, as accompaniments to the unique lineup of wines Matthiasson produces, ranging from single-vineyard Cabernets to more esoteric fruit and wine co-ferments. While many collectors still may not have heard of Matthiasson, Steve says he is proud to be sought after by sommeliers and others in the wine trade: “We like to say we’re the musicians’ musician.”   Both Jaime and Steve believe strongly that their businesses must be both environmentally and socially responsible. “It’s so important to stand up for what you believe in,” Jaime emphasises. Today, Trois Noix boasts a range of sustainability initiatives, including B Corp status, a high-level sustainability certification which only two other wineries in Napa currently possess. Though not specific to wine or agriculture, B Corp certification is awarded after a rigorous assessment to prove a dedication to positive community impact alongside profit.   In the same vein, all of the vineyards Steve farms for Matthiasson are organic, which is the certification that is the most meaningful to him – and represents a full circle of sorts from his early days studying agriculture, when winemaking was not yet on the horizon. “Organic farming has become not just accepted but embraced since I’ve been here,” Steve says, saying that it’s becoming the norm rather than the exception, especially so for the most well-known cult Napa wineries. “And it’s not just for PR,” he adds, saying many don’t broadcast their farming practices. “They truly believe it makes better wine.” Steve believes the standard of farming has improved dramatically since he arrived in Napa and so has the quality of the resulting fruit. “As the years have gone by, our ability to do the right thing has increased,” he says.  The resulting wines that both Trois Noix and Matthiasson produce are crafted in a fresh style, with an emphasis on primary fruit and terroir-specific cuvées, as opposed to dominant oak or heavy extraction that have been the trend for fine wine in Napa. Araujo says she is trying to craft wines that are reminiscent of Napa 50 years ago, by using a light hand. “We started getting bigger and bolder in Napa, and that’s fine, but we can do this, too, and do it well.” Araujo describes her goal each vintage as crafting wines in a “sweet spot”, built to enjoy immediately but also with the structure and acidity to age for several years at a minimum.    At Matthiasson, pick dates are watched closely, and occur on the early side for Napa, so that alcohols remain low and acidity is naturally brisk. Other than a small amount of sulphur, no other additions are made. “We utilise traditional winemaking methods,” Steve says – quick to note, though, with a laugh, that there is a difference between “natural and natty”, explaining that his goal is to make fresh, clean wines from the healthiest fruit possible. Unlike other Napa wineries that employ optical sorters and tables lined with harvest workers examining every berry, Mathiasson does not sort the fruit prior to fermentation, trusting instead in the farming and meticulous picking over multiple passes.   “We’ve always been an agricultural community, and no one wanted to talk about that for a long time,” Jaime tells me. She believes the future of Napa will be a focus on not just high quality but also history, community and a reputation for doing the right thing. These will not be talking points for her brand only, however, as last year she was elected Board Chair of the Napa Valley Vintners. A nonprofit trade association founded in 1944, NVV acts as a voice for the wine business in Napa Valley, promoting, supporting and advocating for its over 500 members. “I’m a bridge between old and new because of my family and my experience,” Jaime says, explaining that she hopes to bring a fresh perspective on the future of Napa, one that emphasises a range of styles and price points, but most of all, is able to welcome a wider range of people than ever before, by showing the varied people and places of the region. Matthiasson voices a similar ethos. “The wine business has so much artifice, but we want to let people in.”  Matthiasson and Trois Noix collaborated on a special lot for Premiere Napa Valley last year – a lot that we purchased and will soon be releasing. In a region where wine is often a byword for luxury, two producers are dedicated to reminding drinkers of Napa’s humble roots. Rachael Ryan – Senior Buyer for our US arm, Vinfolio – talks to Jaime Araujo and Steve Matthiasson about their philosophy, farming and approach to making wine

Farming for the future: Trois Noix and Matthiasson 

It’s a damp and foggy morning when I arrive once again in the very quiet streets of Auxey-Duresses for my annual pilgrimage to taste the new Maison Leroy Collection. Last year Madame Lalou Bize-Leroy was in Monaco, so I’m looking forward to seeing and tasting with her again – on what happens to be her daughter’s birthday. Two dogs rush out to greet me eagerly – the 13-year-old black poodle Nine and five-year-old Grand Basset Griffon Vendéen Olga, both quickly quietening down once appeased with some gentle pats. Madame, meanwhile, stands behind them, as elegant and unassuming as ever.   Talking briefly about the state of the market, she repeats how the most important thing is the happiness of our clients. It was at the forefront of her mind when she decided on the wines in this year’s collection, which is dominated by the 2017 and 2018 vintages, with the oldest wine from 2011. It’s good to mix things up, she tells me. After last year’s extensive library release with a flurry of back-vintages, this year she wanted to give the youngsters a chance to shine.  She describes 2018 as a more complete vintage, there is more wine, more matière than 2017; nonetheless 2017 is more refined and delicate, somehow more approachable. We talk about what makes a “grand vin” and she says: “La qualité, c’est les rendements.” (“Quality, it’s the yield.”) Taking Aligoté as an example, she explains that she’ll rarely make as much as 20hl/ha for the Domaine Leroy and Domaine d’Auvenay Aligoté – and for her that’s the limit for producing a high-quality wine. It is impossible to make a good Aligoté at 40hl/ha, she argues – and as she knows from tasting those watery, dilute wines. “I’d actually rather drink water,” she confesses. It’s no secret that her Aligoté is special: and Gilles Desprez (Bize-Leroy’s right-hand man) notes how he was once blown away by a bottle of 1999 D’Auvenay Aligoté served to him blind – a wine that those around the table all thought was a Grand Cru white.  There’s no better judge of a wine than blind tasting – as Bize-Leroy knows. To this day, she blind-tastes everything that makes its way into bottle under the Maison Leroy label. She was recently tasting some 2024s for the range and notes how it’s easy to find a great Nuits-Saint-Georges or Gevrey-Chambertin, but is too often disappointed with Vosne-Romanée and Chambolle-Musigny – struggling to uncover wines in these villages that are worthy of the Leroy seal of approval.  Our tasting begins with the reds this year, starting with an array of 2018s, sampled from south to north, “dans le sens de la Côte” (along the Côte), before moving through the 2017s to a 2016, 2015, 2012 and, finally, the oldest wine in this year’s collection, a 2011 Nuits-Saint-Georges.  The whites include an appellation that she rarely tastes and one that almost never makes it into the range: Savigny-lès-Beaune Blanc. The 2018 in this year’s collection, however, is special – a wine that you wouldn’t be a fool to call Corton-Charlemagne blind, she tells me. And (of course) Bize-Leroy is right: it is sumptuous, with a level of richness and density that far surpasses that of a mere “village”.  With air, it develops further, offering impressive complexity. Madame looks at Gilles: “It’s unfortunate we don’t have any Corton here to compare,” she says. Gilles confirms there isn’t any to hand while she considers the wine in front of her, before insisting – “Are you sure we don’t have any here?” The message is understood: Gilles says there may be some in another building and sets off to find it.   We keep chatting, tasting the 2018 Auxey-Duresses, a little shy after the 2018 Bourgogne Blanc (in her words: “the best Bourgogne Blanc we ever had”) and the superb Savigny. I ask if there are any wines she buys every year – an idea she’s fast to reject: she doesn’t have any contracts, each wine is selected purely on its quality in that specific vintage. I clarify that I meant if there were specific vineyards that she particularly likes, and finds herself buying year in, year out – and says that both Meursault Gouttes d’Or and Chassagne-Montrachet Morgeot are certainly favourites, although it all comes down to how they taste.   Gilles comes back with an unmarked bottle, immediately recognisable by its shape as Domaine Leroy. He is out of breath (earning some teasing, but also having run up and down 200 stairs to retrieve the bottle in question). The wine – a 2018 Corton-Charlemagne from the property – is quickly opened and served. It is typical Leroy: the nose is slightly muted, with some reduction and the popcorn-like notes that you often find in Bize-Leroy’s whites. On the palate, this is what you call packed: I have rarely found such concentration in a Corton-Charlemagne, even in ripe vintages chez Leroy. Madame states that she thinks many would call this a red if served totally blind, given its “matière”. “This is a grand vin,” she says. She explains how special the plot is, at the top of the hill, above her Corton Renardes: “C’est un terroir à rouge.” (“It’s a red terroir.”)   Going back to the Savigny-lès-Beaune Blanc seems like a pointless exercise after the Corton-Charlemagne – but is far from it. The Savigny has benefited from warming up and being open for an hour. In fact, it is far from ridiculous to compare it to its grander sibling. Indeed, Madame Bize-Leroy pauses over it, saying she finds the Savigny more balanced – the wine feeling beautifully layered, yet not heavy or dense. It is by far the best Savigny-lès-Beaune Blanc I have had the chance to try and – as proven by this comparison – would rival most Corton-Charlemagne. Of course, the 2018 Domaine Leroy Corton-Charlemagne is a baby – a wine built to age that will need years before being approachable and Bize-Leroy herself confirms that it won’t be released anytime soon. It has everything to be an exceptional wine in the future, but the Savigny is the one to drink now.  This is my 10th year at FINE+RARE and it’s relationships like this one that define our business: having the chance to share a moment with one of Burgundy’s legendary winemakers, talking openly and honestly about two of her wines, is truly special. Some are fast to dismiss Maison Leroy as “just” Bize-Leroy’s négociant label, perhaps out of ignorance or lack of exposure to the range. I can’t pretend these wines are cheap, but I also can’t pretend that Madame Leroy is like other winemakers. Her nose is remarkable, her access far-reaching, and the resulting wines one-of-a-kind. I can only admire this 93-year-old woman, the way she describes her wines, her humbleness, not to mention the wines that carry her name.  Tasting the 2025 Maison Leroy Collection 2018 Bourgogne Blanc: Maison Leroy’s 2018 Bourgogne Blanc is extremely expressive. Almost exuberant on the nose, it shows concentration, toasted almonds, juicy blood orange and verbena. The palate is equally impressive – and I would be easy to mistake this for a very good Meursault blind. Similarly to its red counterpart, the wine has gained in depth on the palate since we last tasted it. It is lively and expressive, yet with a signature fatness that’s so enjoyable. Madame Lalou Bize-Leroy tells me she has rarely, if ever, had a Bourgogne Blanc of this calibre – and we can only agree at this stage! Drink 2025-2031. 2018 Meursault: The 2018 Meursault from Maison Leroy is less immediately expressive than the Bourgogne Blanc, tasted just before – but don’t let that deceive you. You can feel the tension and seriousness of this wine, with hints of flinty minerality on the nose. The palate is concentrated and refined, nicely balanced and nuanced, with a creamy complexity. Compared to its Bourgogne sibling, this is clearly of a different calibre – a more aristocratic wine with greater density. Although approachable now, it will benefit from another three to five years in the cellar to express its full potential. Drink 2027-2035. 2018 Savigny-lès-Beaune Blanc: Maison Leroy’s 2018 Savigny-lès-Beaune Blanc is packed on the nose. Lovely brioche notes are underwritten by bruised apple and brighter citrus fruit, with delicate touches of lemon blossom. As the wine aerates, it keeps building in density, with layer upon layer – making for a wine that is beautifully fleshy and inviting. On the palate, the wine is so immediately rich and profound – it would be impossible to call this a village wine blind. It has the signature richness of a Corton-Charlemagne, perfectly balanced between power and tension. This is by far the best Savigny-lès-Beaune Blanc I have ever tasted and would be head and shoulders above most Corton-Charlemagne you can find on the market. This is drinking beautifully now but has everything to age effortlessly. Drink 2025-2040. 2018 Auxey-Duresses: Coming from a terroir that can sometime be a bit too flamboyant or invasive, Maison Leroy’s 2018 Auxey-Duresses feels very discreet after the Savigny-lès-Beaune. With notes of fresh almonds and a hint of reduction on the nose, this feels a bit muted. On the palate, the wine clearly has the concentration of the vintage, yet is quite elegant and restrained with a hint of white pepper. This is lovely but will need a few more years to be approachable. Drink 2028-2035. 2018 Bourgogne Rouge: Last tasted in February 2022, Leroy’s 2018 Bourgogne Rouge still displays a very charming, delicately perfumed nose that oscillates between dried rose petals and little red berries, but it seems to have gained in weight and density. It retains beautiful acidity balancing the concentration of the vintage, the finish is clean and vibrant. This is one of our favourite renditions of the cuvée in recent years, youthful and drinking beautifully now, this should keep evolving positively for another seven to 10 years. Drink 2025-2035. 2018 Monthélie: On the nose Maison Leroy’s 2018 Monthélie has beautiful notes of violets wrapped up in a mix of red and black berries, especially blackcurrant. Those very pure and delicate floral aromas carry through to the palate, accompanied by tannins that are very subtle, almost with a hint of sucrosity that makes one salivate. This is a very complete wine that outperforms in this warmer vintage: a wonderful expression of this terroir that, for me, displays the elegance of Volnay with a weightless mouth-feel. Drink 2027-2037. 2018 Volnay: Served just after the 2018 Monthélie, Maison Leroy’s 2018 Volnay has a slightly more discreet nose. It’s perfumed and all about finesse yet a bit shy at this stage. On the palate, there is good concentration and precision, but it does not provide the crunch and freshness that you’d expect at this stage. This is surely elegant and refined, but lacks that little twist that will surely come with a few more years in the cellar. Drink 2028-2040. 2018 Savigny-lès-Beaune: As with its white sibling, Maison Leroy’s 2018 Savigny-lès-Beaune could be mistaken for a Corton blind. It has such a concentrated, solar nose with a darker fruit profile. There’s density on the palate too, the wine fleshy and rich, but not heavy. It’s nicely balanced, with delicate tannin structure and a precise finish. It’s as juicy as it is approachable. Drink 2027-2037. 2017 Gevrey-Chambertin: This was one of the highlights of the 2022 Maison Leroy Collection when it was first released. The wine has retained all its depth, complexity and power, but has shut down a little bit. It is packed with dense dark cherries, hints of sweet spice and forest floor. On the palate the wine offers an enjoyable, mouth-coating, generous and balanced structure, yet the wine feels a bit muted compared to where it was three years ago. This is nonetheless offering a very long finish with fresher note lingering. This is surely a grand village Gevrey that will simply need to be forgotten in the cellar for a few years! Drink 2030-2040. 2017 Pommard: Maison Leroy’s 2017 Pommard speaks of its terroir, combining rich, brooding, ripe blackberry, with hints of blackcurrant and a touch of rusticity, lifted by the freshness and precision of the vintage. On the palate, it has a firm but delicate structure with chewy tannins that are both muscular and velvety. Tasted right after a flight of 2018s, this seems much more approachable (as is often the case with 2017s). The refreshing backbone of acidity drives through the core of the wine, lending a beautiful sappiness to the long finish. Drink 2025-2035. 2016 Santenay, Premier Cru, La Comme: Immediately expressive, Maison Leroy’s 2016 Santenay Premier Cru La Comme comes from this underrated terroir, on the southern border of Chassagne-Montrachet. The charming, multifaceted nose oscillates between raspberry and juicy cherry with a hint of liquorice. The wine is mouth-coating; you can feel the substance here, with a lovely texture that remains delicate and refined. This clearly shows the concentration of the vintage and its tiny yields, but it is all wrapped in a very elegant mouth-feel – creating a wine of great balance. It’s in such a lovely spot now that this is hard to spit out! Drink 2025-2035. 2015 Chorey-lès-Beaune: Packed on the nose, Maison Leroy’s 2015 Chorey-lès-Beaune is quite shy at first, but with a bit of swirling you start to notice how dense and saturated this wine is, with aromas of ripe blueberries, blackberries and a hint of spice (cinnamon maybe?). On the palate, it is concentrated with mouth-coating tannins and layers of berry fruit – raspberry, strawberry and blueberry. This has a lot to say and offer, with an impressively persistent finish, but will benefit from a few more years’ cellaring to reveal its full potential. Drink 2028-2040. 2012 Côte de Nuits Villages: Made with fruit from around Nuits-Saint-Georges and Corgoloin, Leroy’s 2012 Côte de Nuits Villages is always a bit backward on the nose and slightly austere. But it’s also elegant and delicate, the floral notes combining with tertiary notes. On the palate, this feels like it is in a slightly awkward phase, very dense with soft, integrated tannins yet somehow disjointed between the rich dark fruit and a tertiary character. I would leave this for a few more years before revisiting. Drink 2030-2040. 2011 Nuits-Saint-Georges: Finely perfumed, Leroy’s 2011 Nuits-Saint-Georges offers a delicate nose of mixed red berries supported by more earthy notes, some pot-pourri and a hint of spice. On the palate, it’s concentrated and charming, but with air opens further and shows its density, still youthful for a 14-year-old village wine. There’s a hint of rusticity towards the finish that makes one salivate. This is far from the austere expectation one may have for this combination of vintage and appellation. It’s not reached its drinking plateau but is perfectly approachable now. Drink 2025-2040. The new Maison Leroy collection will be released soon: you can see all the wines in the 2025 collection here. Over two trips to the region, our team delved into the 2022 vintage – visiting, tasting with and talking to a range of producers up and down the Côte d’Or. Here we break down the year by producer, from north to south, with a summary of how each fared and our favourite wines from the tasting table

Making Champagne is different. More than any other wine, it’s a long-term game. The region’s cellar masters don’t see the fruits of their labour for years, even decades, depending on the wine; their work closer to that of a master distiller rather than most winemakers.  “It humbles you – you are not the superstar. The superstar is definitely the Champagne,” Elise Losfelt – who took over as Cellar Master at Champagne Charles Heidsieck earlier this year – tells me. She has just done her first blends for the prestigious House, with wines selected by her predecessor, Cyril Brun – and those blends won’t be tasted by the rest of the world for as long as eight years, when it comes to the vintage wine.   With three young children (aged three, four and six), Losfelt’s home life is very much about the here and now, but the world of Champagne gives her the chance to slow down; “Putting myself in a timeline – not just in today,” she explains. Losfelt has big shoes to fill, following in the footsteps of Brun, who arrived at Charles Heidsieck in 2015 and helped steer the House into a new, more prosperous era, including the re-introduction of the property’s Champagne Charlie cuvée. He has since caused a stir in the world of sparkling wine by being the first Champenois ex-pat to move to Italy, taking on a new role at Ferrari (one of the top names in Trento DOC).  Similarly to Brun (who came from Veuve Clicquot), Losfelt arrives from one of the Moët Hennessy properties, Moët & Chandon. Also like Brun, wine runs in her blood – she’s the seventh generation to make wine, with her mother at the helm of the family estate, Ch. de l’Engarran in the Languedoc.   Losfelt spent over a decade at Moët & Chandon, a business which became “a place that feels like family”; but when the phone rang and it was a job offer from Charles Heidsieck… “I had to grab it,” she tells me. Not only has she always loved the Charles Heidsieck Champagnes, but it was over a glass of 1995 Blanc des Millénaires that she and her husband first connected, back in 2014.  For the majority of her time at Moët & Chandon she was the Head of Vinfication, preparing the wines for the cellar master, responsible for much of the winemaking – almost everything but the final blend. It was the scientific side of winemaking that had attracted her originally, but the lure of this unexplored artistic side of the job, combined with her emotional tie to the wines, made the opportunity impossible to resist. It was, as she told me, time to leave her “first family” to take on a new challenge.   For her, Charles Heidsieck stands apart from others for its endless complexity. “It’s a Champagne that doesn’t offer you just one facet, doesn’t offer you just one aroma, or just one characteristic of aromas… it’s everything together,” she explains. While the brief for something like Moët Impérial is to craft a consistent and fresh, vibrant wine, her brief at Charles Heidsieck is for “profoundness”. Even at the non-vintage level, she is looking for wine that would meet many Houses’ vintage standards; the aim is to consistently exceed quality expectations.  Talking about trends in the region today, I enquired whether there were any plans for Charles Heidsieck to follow in the footsteps of Louis Roederer, Krug or Jacquesson – creating numbered non-vintage releases, highlighting the base vintage and variation between years, rather than the consistency historically seen as desirable. There are no plans for imminent changes, but the House has – since the 1990s, under Chef de Cave Daniel Thibaut – had the “mis en cave” date, the year in which the bottle was laid down in the cellar for secondary fermentation to get underway. As for adding tirage or disgorgement dates: “This is a question for me in five years,” Losfelt says, with an unrushed shrug.  For this new Chef de Cave, it is only the beginning – with much to learn, test and try before any changes are made. Losfelt’s job is a little like the now-famous Patek Philippe advert, she tells me; she’s just keeping the seat warm for the next generation, inheriting the work of her predecessors and creating the tools for those that will follow her. As she tells me, “Every step of the way, one choice makes a difference.”  As we await the first releases bearing her fingerprint, there’s no doubt she’ll be working tirelessly to preserve and further Charles Heidsieck’s legacy. “Until it’s tasted, and it's good, I will not rest,” she says, a clear sense of responsibility for the weight on her shoulders. Earlier this month our team spent a week visiting producers, tasting and talking about Burgundy’s 2021s. Here we break down the vintage by producer, from north to south, with a summary of how each fared and our favourite wine from the tasting table.

Ian Chang is one of the most well-respected and accomplished whisky makers in the modern era. After 16 incredible years at Kavalan, in which he and the distillery went from unknowns to untouchables, Chang is embarking on a new adventure. This time he is turning his sights to one of the most exciting whisky-producing regions in the world: Japan. You’d forgive Chang for being egotistic. Over the past decade and a half, the Taiwan-native has received countless awards and accolades for his Kavalan single malts and is fawned over by whisky lovers and the press. And yet, even through his medical mask – there are still Coronavirus restrictions in Japan when we speak via Zoom – on a slightly pixelated screen, you can feel a genuine warmth and kindness emanating from the Master Blender. He is fiercely intelligent, good-humoured and modest. When it was announced in 2020 that Chang would be leaving Kavalan, the news was met with surprise and intrigue. Why was he leaving? Where might he work next? Would he stay in Taiwan? “The reason why I left Kavalan is because I wanted to change to a different environment,” Chang tells me from his new office in Japan. “Before this project, I only had experience in Taiwan,” Chang explains. “Producing whisky in a hot climate, which means that age statement whisky can virtually not be produced due to very high angel share.” Chang says he immediately signed onto the new distillery project spearheaded by Karuizawa locals Koji and Yoshie Shimaoka. While some details are already in the public domain about Komoro, located near the fabled original Karuizawa distillery site, this is the first time Chang has spoken at such length about his intentions for the new Japanese whisky distillery. “In Japan, in Karuizawa, they have a very similar climate to Scotland, so our plan is to produce whisky with age statement,” he tells me with glee. The first Komoro age statement will be a 12-year-old, followed by a 16- and 20-year-old. Thereafter, the age statements will increase in five-year increments, Chang says. There will be some non-age statement bottlings before the whisky reaches the 12-year mark. “So hopefully I can see my very first 40-year-old whisky,” he says with a soft chuckle, “If I’m still alive – fingers crossed.” Chang joined the whisky industry as a novice (or “from zero” as he calls it) in 2005. After graduating with a degree in food technology, he applied on a whim to a role at Kavalan’s parent company. Despite his lack of experience, Chang passed the interview stage, which required him to identify flavour notes in whisky, with flying colours. For the first year, while the distillery was being built, Chang voraciously read everything he could on whisky. Then, in 2006, the young whisky-maker-to-be met a man who would change his and the distillery’s destiny: Dr Jim Swan. “That was when the official learning started,” Chang tells me. Dr Swan – who was dubbed the “Einstein of whisky” for his pioneering scientific research and ability to help new distilleries with his unparalleled whisky production and maturation know-how – began by teaching Chang the fundamentals. This education took the best part of three years and covered everything from malting, milling, mashing, fermentation and double distillation. By the time the very first Kavalan Classic Single Malt was released in year three, the team knew they had produced something exceptional, and it didn’t take long for the wider whisky world to start taking a keen interest in Taiwan, Chang and Kavalan’s ground-breaking techniques. Not that Chang would say as much. Ever humble, he continues: “That’s when my focus with Jim Swan switched to blending.” The duo travelled extensively, visiting cask suppliers across Europe and the USA, while Dr Swan taught his protégé everything he knew about whisky from his 40-year career, and, you sense, his learnings from the school of life. When Dr Swan suddenly passed away in 2017 at the age of 75, he left a gaping chasm in the industry and many people’s lives, Chang included. Five years after his mentor’s sudden passing, Chang occasionally uses the present tense when talking about Dr Swan and takes a nano second to compose himself before he continues with his train of thought. The reverence and respect is clear to see. Of all the people Dr Swan taught, directly and indirectly, Chang spent the longest time under his tutelage, and he continually credits him for every success that he has had. For his latest project at Komoro, Chang said he wants to “bring Japanese whisky to the next level” by applying the many techniques he learned from Dr Swan. It’s a brave move in more ways than one. Chang has relocated to the country and doesn’t speak the local dialect, yet – but he is very grateful that his local colleagues are willing to learn and speak English to him. He is also joining a whisky-producing region that is at a very interesting crossroads in its history. It was announced last year that new regulations will come into force in 2024 which stipulate all liquid labelled as “Japanese whisky” must be produced (from fermentation to bottling) in Japan. This undoubtedly wouldn’t have been a problem for Komoro but it does mean several very high-profile competitors are scrambling to change their practices accordingly. Chang doesn’t comment on this but he does say: “To be honest, so far, I think all the major producers, such as Suntory and Nikka don’t really use STR [Shaved, Toasted and Re-Charred casks] at the moment. “So, by introducing Jim’s technologies and also his way of new-make production we are going to enrich the spirit produced in Japan and make a whisky which will be very much more enjoyable for consumers to enjoy globally – this is our aim for the future.” One of Dr Swan’s most famous contributions to the whisky world, and Kavalan specifically, was STR (Shaved, Toasted and Re-Charred casks). The invention was born out of necessity in 2010 when shortages of refill casks began to cripple the industry. Chang says Kavalan was in “serious trouble” because the distillery was a mere four years into production and couldn’t secure any re-fill casks for their new-make spirit. It was then that Dr Swan suggested the team used ex-wine casks instead of the in-demand refill Bourbon. This was highly irregular; ex-wine casks were undesirable because of wine’s organic acids, which would spoil the whisky and make it astringent. Simply, the process of shaving, toasting and re-charring casks removes the unwanted acids, breaks down the lignin structure of the wood to release wood-related compounds (including the desirable vanillin and caramel notes), and imparts a nice, sweet character to the spirit.  When asked what the secret is to producing an exceptional whisky, unsurprisingly Chang’s answer has been heavily influenced by his mentor. For Dr Swan, it was always about layering flavours and textures. “We want to make sure that it’s a rich and complex whisky but at the same time, very balanced without any off notes. To Jim, off notes were a big minus in terms of quality and that is why distillation and fermentation is also very critical in addition to wood policy,” Chang explains. “Because off notes can come from three places: fermentation, from the wood and also from fast distillation, these are the three areas that Jim always paid attention to.” This attention would include visiting cask suppliers regularly and ensuring distillation is slow to promote interaction between the new-make and copper. He would also keep a close eye on fermentation so the temperature increases from the beginning until the end. For Chang, and Dr Swan, there is a science and an art to whisky making and blending. “When it comes to marketing, especially during masterclasses, sometimes you’ve got to tell a little bit of stories so that’s when parts of the art and romance come in,” he says, laughing gently – making him even more endearing. “But to be honest, to be a blender, sometimes you have to use your imagination as well. You have to imagine how a Sherry cask will blend with a peated new-make, for example. “Jim always said, whisky making is a combination of art and science. And I think it’s maybe half, half. I think if you don’t have good imagination, you cannot really be a good blender but if you don’t know the science and just know the romantic side you cannot produce good new-make to begin with, so you have got to combine the two to make sure that the new-make and the wood go very nicely together.” During his 18 years in the industry, Chang has seen a lot of change. With new distilleries opening at a staggering rate and lost icons being brought back to life, there has arguably never been a more exciting time to work in single malt whisky production. Chang agrees and says things are looking “very bright”. So, what does a man like Chang do in his spare time, when he’s not producing remarkable whiskies consumers want to buy? “I watch Netflix,” he says before I can finish asking the question, and then lets out that laugh again. It’s a typically frank and relatable response that comes as a slight shock to us both. Most would – truth or not – say something that made them sound high-brow but not Chang. He continues to say that he’s recently finished the entire box set of 24 (a recommendation by a friend who presumably thought he had a lot of time to kill or difficulty sleeping), a Taiwanese drama, the latest Karate Kid (Cobra Kai) and a series about Japanese history. It’s an eclectic mix and refreshingly honest. As the Komoro project enters its next stage and whisky starts to run from the stills, there will be a lot of pressure on Chang to produce another award-winning single malt but those who know him won’t be concerned. With his formidable knowledge, calm confidence and unwavering integrity, you sense he’s going to do himself – and Dr Jim Swan – proud. Browse all whisky listings or read more Editorial

Ian Chang: the humble student

Auxey-Duresses is, at best, sleepy. As I rolled into the village on Monday morning, the streets were empty in the grey of a rainy winter’s day – just one retiree trundling slowly toward the boulangerie. But here, in this quiet corner of Burgundy, lies the home of Maison Leroy.  A visit to the négociant arm of the Leroy empire is a chance to look behind the curtain at one of Burgundy’s greatest properties, and the allure of such an audience doesn’t fade – even now, on my 12th visit. The wines are remarkable – and rapidly vanish into the cellars of eager collectors as soon as they’re released.  Despite the prestige of this address and its wines, however, it’s a humble, rural Burgundy charm that reigns supreme. Soon after I arrive, the phone rings – it’s Madame Lalou Bize-Leroy herself calling from the south of France to say hello, apologising that she can’t be there herself and hoping that the wines are showing well. There’s no pretence or politics, just modest and unassuming politesse.  And that style is characterised by the building itself. The Maison feels like a home – one that hasn’t changed for 30 years, with stacks of books squirrelled into every corner and the walls lined with articles, photos, reviews and other mementos. One could spend hours exploring this living archive. In amongst every issue of Bettane & Desseauve’s guide and issues of the Wine Spectator stretching back to the 1990s, there’s a picture of Bize-Leroy with Nixon, while nearby there’s a hand-written note from one Bob Parker.  Each year the Maison releases its annual collection – not just the latest vintage but a curated selection from the house’s extensive reserves, all hand-selected by Lalou Bize-Leroy herself. In September, she and her team start preparing the list, tasting endlessly to decide which wines should be set free into the world the following year. And there is an extensive back-catalogue to choose from – Bize-Leroy has been buying the very best parcels she can find for half a century. Over four months, the team decides what to release – wines that are drinking well or showing something that catches Bize-Leroy’s eye (or, more accurately, her palate).  While each collection used to be extensive, the releases have become increasingly focused. This year sees 10-15 reds and whites – and is particularly appealing to the wine geek. The collection is dominated mainly by 2017 reds and 2018 whites, however each one is paired with a more mature vintage of the same wine (or as close to as possible), stretching back to 1970. Inevitably, the older vintages are available in tiny volumes – but they’re testament to how age-worthy these “mere” négociant bottlings are.  Tasting through the range, the 2017 reds were a particular highlight. Even at 10am it was a challenge to resist swallowing – they are irresistible with their pure, crunchy fruit, so fresh and delicate with great persistence and complexity. The 2018 whites, meanwhile, from a warmer year are only just entering their drinking window and will gain with more time in the cellar.  Last year we couldn’t make it out with Covid restrictions, so it was all the more special to be back at Leroy this week. Emerging once more on Auxey-Duresses’s unassuming streets, I left even more in awe of this amazingly humble address.  Tasting notes: the Maison Leroy 2022 collection White 2018 Bourgogne Blanc: A pale lime-tinged colour, Maison Leroy’s 2018 Bourgogne Blanc is a bit shy at first, but with air opens up to reveal a fresh, floral nose. On the palate, the wine broadens, with layers building in the mouth to bring richness and stone-fruit notes. There’s a slight puppy fat to the texture at present, but this is lifted by vibrant acidity, making for a moreish wine overall. This is very different to last year’s sharper-angled 2017; the 2018 is a much more gourmand wine that will go beautifully with food. Drinking well now, it will age eight to 10 years without breaking a sweat. 2018 Saint-Aubin: Golden and concentrated in colour versus the Bourgogne Blanc, the 2018 Saint-Aubin has a profound, expressive nose – with limey tension. The palate is driven by a mouth-watering salinity, complemented by layers of vibrant citrus – blood orange, lemon and grapefruit – on show. Harmonious and balanced, the finish is long. Might need more time to reveal its full potential, but there’s no doubt that the potential is there.  2018 Meursault: Maison Leroy’s 2018 Meursault is attractive and concentrated with ripe, juicy white peach pulled fresh from a tree in the summer. But it’s far from simple fruit here – with honeycomb and grapefruit adding to the overall profundity. On the palate, there’s incredible tension between the ripeness of the 2018 vintage and a mineral acid backbone. Very vibrant and approachable, this offers depths that defy its status as a village wine. As with the Saint-Aubin, it will offer more with time in bottle.  2018 Meursault, Premier Cru, Les Genevrières: A step up from the village Meursault, the Premier Cru Genevrières offers even more concentration. The deep, complex nose is full of yellow stone-fruit, white blossom and hints of hazelnut. On the palate, it’s mouthcoating, but the concentration is not overblown – there’s precision and focus, with a saline mid-palate and mouth-watering acidity to complement the wine’s generosity. The finish is impressive, combining sharp-angled freshness and the wine’s sumptuous volume. This is built to age but is approachable now. 2014 Chassagne-Montrachet, Premier Cru, Les Chenevottes: The 2014 Chenevottes is expressive on the nose – it’s a wine with a lot to say. There’s a hint of reduction, but beyond that layer upon layer of aromas is revealed, showing different facets. Floral, lime and orange notes evolve on the palate, developing into deeper stone-fruit, ginger and honeysuckle. There’s a wash of salinity on the long finish that lifts the wine. Totally approachable now, this will age effortlessly for 10-15 years. Red 2018 Bourgogne Rouge: The 2018 Bourgogne Rouge from Maison Leroy is beautiful – punching well above the weight of its modest appellation. The nose is poised, perfumed and delicate – with expressive dried rose petals dancing against a backdrop of pure raspberry, wild strawberry and cherry fruit. There’s great density on the mid-palate, the alcohol and tannins seamlessly integrated with vibrant acidity from this warm vintage. It’s our favourite release of the cuvée for several years. 2017 Côte de Beaune Villages: Maison Leroy’s Côte de Beaune Villages is a blend of village fruit; while the exact blend is never disclosed, it can span the whole Côte, from Maranges to Beaune. The nose of the 2017 is exuberant, with sweeter and darker fruit than the Bourgogne Rouge, while a hint of smokiness gives a savoury edge. It’s both fresh and dense on the palate – there’s underlying power, yet the fine tannins make it feel light on its feet. The finish is long, laden with crunchy fruit. Very approachable now.  1997 Côte de Beaune Villages: The 1997 is remarkably dense in colour, with mature aromas of cured meat and very concentrated dark fruit. From a riper vintage versus the 2017, the richness of the fruit is evident here, however there’s still good balance on the palate with plenty of acidity and resolved tannins. It’s at a beautiful point of maturity, unlikely to gain from further ageing, but there’s no rush – with sufficient density to hold for five to 10 years. 2018 Savigny-lès-Beaune: This Savigny-lès-Beaune is deliciously enticing – a nose of archetypal, crunchy sour cherry. While it’s red fruit that draws you in on the nose, the palate shows a more serious side, with complexity building in layers. Freshness and finesse runs through the palate, with a vibrant acid backbone and lifted finish. Verry attractive and approachable, this is a superb, moreish wine that will keep you reaching for more.  2018 Beaune, Premier Cru, Les Montrevenots: This vineyard borders Pommard, sitting just above Beaune Clos des Mouches on a gentle southwest-facing slope. This Premier Cru site instantly shows more depth than the village wines, with an expressive, multi-layered nose with shifting cherry, blackberry, plum and wild strawberry aromas and an alluring hint of smoke. On the palate, the vibrant red fruit and freshness of this site and youthful Pinot Noir mingles with the ripe and serious dark-fruited side of the 2018 vintage. Beautifully balanced, this can be drunk now but will evolve nicely for 10 years or more. 2017 Nuits-Saint-Georges: The shift to the Côte de Nuits is instantly noticeable here. The wine has a deep colour and more austere, serious nose – with dark-fruited power accented by lighter white pepper spice and florals. On the palate, layers of bramble fruit build to create a concentrated and structured wine. There’s a firmer tannic backbone as is typical of Nuits-Saint-Georges, without being overly grippy. With underlying power, this is an aristocrat. The depth and balance here offers great potential, hold onto this for 15 to 20 years at least. 2017 Chambolle-Musigny: This is still beautifully aromatic on the nose, with a delicate, lace-like array of fruit and florals. This is pretty and refined, yet with underlying powerful. There’s a lot happening on the palate, with a certain juiciness balanced by tannins that are already beautifully silken. Despite the supple tannic structure, this feels like a baby – and will only deliver more with time in bottle. The length is stunning, lasting for minutes. Punching well above village level, this was a new favourite in the line-up – and one of the most promising in the range. 2017 Gevrey-Chambertin: This was the most concentrated wine in the line-up – both in terms of colour and aroma. Combining depth, complexity and power, this is impressive, with a multidimensional nose that keeps evolving in the glass, showing different facets from sweet cherry to gentle sweet spice and floral notes. The palate is turbo-charged – mouth-filling and generous, yet all the while retains superb balance. The tannins are chewy and plentiful, yet all wrapped in silk, bringing an overall impression of finesse. There’s incredible length, with a fresh, juicy finish. As with the Chambolle, this will only improve in bottle. It’s interesting to taste it side by side with the Chambolle-Musigny, each anchored in their terroir, but sharing finesse, poise and elegance.
