It was a small yellow aphid that disregarded national borders, wiping out the livelihood of every grape grower in its way and there was no known cure nor effective prevention in its first devastating years. Even when a cure was discovered, growers were reluctant – and often financially unable – to use it.  As a result, phylloxera vastatrix  – vastratix meaning ravager – continued to nibble on the roots of vines across western Europe, sucking the lifeblood from the vines and leaving wounds for any passing infection. By 1900, 2.5 million hectares of France's vineyard had been uprooted, causing production to slump, encouraging dodgy dealers to make fake wine, and leading to mass protests.  The story of phylloxera in Europe started as a well-intentioned gift. In 1862, an American grape grower sent some cuttings of native vines to his friend in the Rhône Valley who planted them, unaware of the damage it would inflict on his compatriots. Within a year, local growers were lamenting their sick vines. Phylloxera had wanderlust, sparing no French region; nor did it respect the country's finest terroirs or illustrious châteaux.  However, a concerted national response to the potential ruin of the country's national beverage was not forthcoming. The French government was too busy putting on International Exhibitions in Paris (1867), opening the Suez Canal (1869) and waging war on Prussia (1870-71). In 1870, the government acknowledged there might be an issue, offering a 20,000 Franc reward for a cure. Remedies were offered including burying living toads in the vineyard, adding volcanic ash from Pompeii to the soil or inviting a marching band to play to the vines. Unsurprisingly, the vines continued to die. In 1880, a solution was finally accepted: graft European varieties to the roots of American vines. However, grafting noble French varieties - vitis vinifera - to the roots of these lowly American varieties seemed like sacrilege to many growers. It was thought they would affect the nobility of their precious wines. There was also the issue of cost: uprooting your vineyard, replanting and then having to wait between three and five years for a crop did not feed a family and the concept of state aid was still a long way off.  As a result, many tried to limp on for as long as possible, injecting carbon bisulphide, an expensive and toxic solvent used to vulcanise rubber, into the soil to stave off the inevitable.  The producers in the south of France were the first to be hit in the 1860s and they replanted with high-yielding hybrids. By the turn of the century, the Languedoc was producing more wine than ever before. However, the region's unscrupulous merchants made up for the initial shortfall at peak phylloxera by bulking out grape juice with sugar and water while others made wines from raisins. These practices continued despite the replanted vineyards returning to full production, causing a huge oversupply and depressing prices.  Urged on by a growing labour movement, hundreds of thousands of people took to the streets in 1907 to call for change. The Champagne Riots of 1911 The Champenois followed suit, rioting in the streets in 1911 and the root of their troubles also lay with phylloxera.  In 1892, the Marne was invaded by its first phylloxera aphid and, by 1910, 40% of the region had been affected. But this was no time for production to fall: Champagne sales were booming and to make up for the shortfall, dodgy merchants (and some of the seemingly reputable houses) brought in wines from the Loire and the south of France by the train-load. The wines were made sparkling in their cellars and the bottles emerged, as if by magic, as Champagne. Supply and demand economics suggested that the growers should have been earning more for their fruit as phylloxera affected supply and sales boomed, but fake Champagne kept prices low. Having borne the cost of replanting their vineyards, this was not how growers imagined they would be rewarded and protests ensued.  While most vineyards in Champagne and beyond are now planted on American rootstocks, there are some vines and vineyard owners that play wine roulette and grow vitis vinifera on their own roots. For example, three plots belonging to Bollinger were planted in 1960 in the traditional pre-phylloxera way. One has succumbed to the vine louse but the remaining two parcels are the source of Vieilles Vignes Françaises, a rare Pinot Noir-based Champagne that provides a taste of a bygone era.  We asked Denis Bunner, Bollinger’s Deputy Cellar Master, about the Aÿ-based Champagne House's rarest wine, Vieilles Vignes Françaises, which is produced on its own roots.  Why did Bollinger begin producing Vieilles Vignes Françaises in 1969?  An English journalist Cyril Ray proposed the initiative to Madame Bollinger following a visit in 1967 and this inspired Madame Bollinger to create a wine from the precious vines to commemorate her 70th birthday, which saw the first bottle produced in 1969. The wine was launched in 1974. Are the vines pre-phylloxera? If so, they must be more than a century old. No, the current plots in Aÿ were planted in the 1960s but it is impossible to give an age to the vines due to the perpetual renewal and the way the root system grow [the system is called provignage, which is like vine fostering when there is an empty space to fill. Take a cane from one vine, train it down into the soil and partially bury it with the end sticking out until it forms a separate vine. This is also done in the Nacional vineyard at Quinta do Noval]. There were three plots that weren't grafted but there are now only two. What happened? third plot succumb to phylloxera?  The third plot in Croix Rouge de Bouzy was attacked by phylloxera at the end of the 1990s – the vineyard didn't have protective walls around it. The last vintage was 2004 as we had to uproot it when it fell prey to the infestation. How many acres do the two remaining plots cover?  The Clos Saint-Jacques (Aÿ) covers just over half an acre while the Clos des Chaudes-Terres, which lies within the boundaries of Bollinger’s own lands, covers a little over a third of an acre. In total, they represent 0.36 hectares. Is there anything special about the soil of these two plots that means it resists phylloxera?  The soil is not remarkably different from that in the rest of Aÿ and as per the rest of Champagne it features chalk. Is this special cuvee made every year?  No. Only in declared vintages. What is the average production of Vieilles Vignes Françaises?  This varies by vintage, but falls within the range of 2,000 to 3,000 bottles. A total of 2,420 numbered bottles of the 2009 Vieilles Vignes Françaises vintage were produced. Read more Editorial

The latest from Latour In the wake of last week’s launch of the 2016 vintage of the First Growth’s third wine, Pauillac de Latour, the Pauillac powerhouse will be releasing the 2013 vintage of the Grand Vin, as well as 2015 Les Forts de Latour, its second wine. The 2013 is only the second vintage of the Grand Vin that the property has released since it moved away from en primeur – and there’s no doubt, despite the vintage’s sometimes maligned reputation, that this is going to be highly sought-after. New from Champagne March brings with it a bounty of fine fizz releases. Top of our wish-list are the new wines from Henri Giraud – a House that produces small volumes of outstanding, terroir-driven wines, almost all of which are oak-fermented (and is, for that reason, often compared favourably to Krug). We’ll see the latest release of its multi-vintage cuvée (described by Jancis Robinson MW as “a sort of Montrachet of Champagne”) and the new, 2013 vintage of their top wine, Argonne. Keep an eye out also for 2007 Bollinger R.D. and Pol Roger’s 2012 Sir Winston Churchill.  Single-farm spirits The unfailingly modish and exciting Irish distillery Waterford has been making waves in recent weeks, having scientifically proven terroir’s influence in whisky. This month will see the latest spirits from the Irish distillery released – two single-farm single malts that offer a chance for you to explore the concept yourself. One comes from Hook Head – a site on the southern coast with clay-loam soils, while the other hails from Lakefield, with deep loam soils in County Laois. Burgundy There are still a few 2019s emerging from the Côte d’Or – including wines from Domaine des Lambrays and Le Grappin. Clos des Lambrays was a stand-out from our trip in October last year, while Aussie Andrew Nielsen’s Le Grappin wines (a darling of London’s restaurant scene) offer brilliant value year in, year out. The 2021 collection from Maison Leroy has almost entirely sold out, however we’ll also see the latest releases from the rest of Lalou Bize-Leroy’s empire – Domaine Leroy and Domaine d’Auvenay. Available, as ever, in tiny volumes, these are some of the world’s most collectable wines, and unmissable for Burgundy aficionados. Italian icons After a series of superlative 2016s from Brunello, Tuscany is on the mind. While Castello di Ama’s 2017 San Lorenzo is already available, the 2018 vintage of the Chianti Classico property’s flagship wine, L’Apparita, will be released in the coming weeks. Tasting through a selection of the range with our team, CEO Lorenza Sebasti told us that she and winemaker Marco Pallanti feel it’s “the best we’ve ever made”. We’ll also see the new vintage of Ornellaia’s entry-level bottling – Le Volte dell’Ornellaia, which provides an affordable and earlier-drinking taste of this Super Tuscan estate, ahead of the release of Ornellaia “proper” in April.

Adrianna Catena (Catena and El Enemigo) – 1999 La Tache, Domaine de la Romanée-Conti “Christmas in Argentina is a summer affair – the days are long, and the heat is intense. This year we will gather with family and friends at our home in Mendoza, spending the day together – lunch and a siesta – before dinner on the 24th. I live far from my parents and these are special moments, so we pick our wines for the memories too! They'll include an Adrianna Vineyard White Bones Chardonnay (my mother's favourite), and some Nicolás Catena Zapata (1999 or 2004, perhaps). My father also has a Burgundy collection and always makes a trip to the cellar at some point in the evening, reappearing with a cheeky smile and something extraordinary – like a 1999 La Tâche. For the end – what we call the sobremesa, that long and magical moment after the meal when we are all still gathered at the table, sharing old stories and laughter – a 2008 Vin de Constance.”  Isabel Ferrando (Domaine Saint-Préfert) – 1990 Châteauneuf-du-Pape Cuvée Spéciale, Domaine Henri Bonneau “What I love! First Champagne – maybe a great bottle of aged Champagne, either Selosse or Agrapart (the opposite of Selosse). Ideally around 20 years old – for aperitif. After that a white Burgundy – maybe a great Meursault or Puligny-Montrachet. I love Henri Boillot’s Clos de la Mouchère, that would be a great choice. For the red, it is going to be the 1990 Châteauneuf-du-Pape Cuvée Spéciale by Henri Bonneau because I love this man. I remember him with a lot of tenderness and it will be a lovely bottle to share with the family. And to finish a 1995 or 1997 Sardat Mallet, which is a lovely sweet wine from the Languedoc-Roussillon... Then for New Year I think probably L’Ermita from Alvaro Palacios. I don’t know which vintage I have in my cellar and an old bottle of Ch. Latour for sure. For a white wine, it will be a German Riesling from Markus Molitor. The spirit of opening wines, opening to a new world. I love that! And it is me who is doing the cooking – capon, fish and truffles.”  Matthieu Mangenot (Domaine Long-Depaquit) – 1995 Ch. Lafite Rothschild “Christmas usually offers the occasion to open a wide variety of wines, especially when the family come from various parts of the planet (Washington DC, São Paulo, various parts of France…), bringing back a few fun things. But when it comes to eating and celebrating, serious things are beginning and I can’t skip Burgundy, at least for a part of the banquet! 2016 Chablis Grand Cru La Moutonne, Domaine Long-Depaquit in magnum would be a perfect candidate to pair with our Christmas dinner, especially the seafood part. I love the pure and saline expression of the Chardonnay in Chablis and the fleshy-zesty character that La Moutonne shows with ageing, a combination of structure, refinement and elegance. This 2016 vintage also has a personal meaning for me for two reasons: first because the climatic conditions in spring 2016 were dramatic with a major frost that really made this vintage difficult to make, as well as a rare and unique product. But also because my son Léon was born just before harvest, so this vintage is his! While re-exploring my personal cellar, I came across a bottle of 1995 Ch. Lafite Rothschild, remaining from a series of six I was offered while a trainee at the estate in 1999. I think it is high time to celebrate more than 20 years of activity as a winemaker and we will take this opportunity to pay tribute to this monument from Pauillac! Other wines I will be opening include 2015 Domaine de la Chevalerie, Cuvée Bretêche Rouge, 2019 Crozes-Hermitage Cap Nord, Domaine Combier and 2018 Meursault, Chevalières, Domaine Henri Germain. I like this domaine for it’s personal vision of Meursault, insensitive to more trendy styles.” Luca Martini di Cigala (San Giusto a Rentennano) – 2009 L’Apparita, Castello di Ama “Marco Pallanti and his son Arturo from Castello di Ama visited us in late October, then we visited them a few days ago. I swapped some older bottles of San Giusto with a 2007 Chianti Classico Vigneto Bellavista and a 2009 L’Apparita especially for this year’s Christmas table. The 2007 vintage produced very powerful wines and despite expectations has got good ageing potential but is already drinking well. The 2009 is a medium-power vintage, easy to drink in a relative short time but now in perfect condition. We are looking forward to drinking both this Christmas.”  Desiree Reid (Cardrona) – N.V. Cardrona Otago Pinot Cask, Single Malt Whisky “The day will start with a glass of Bollinger, while the children open their stockings, and the Christmas ham bakes in the oven. Later that evening I’ll finish with a dram or two of the Cardrona seventh birthday release – Otago Pinot Cask. The perfect way to finish a Southern Hemisphere Christmas.” Alvina Pernot and Philippe Abadie (Domaine Alvina Pernot) – 2014 Champagne Cédric Bouchard, Roses de Jeanne, La Haute Lemblé Blanc de Blancs “We love Cédric Bouchard’s Champagnes because he works his Champagne cuvées in the same way as what is done in Burgundy. Each bottling is one terroir and one vintage. For the reds we will be opening 2012 Petite Siberié from Domaine du Clos des Fées – a great producer from the Languedoc-Rouissilon as well as a 2010 Vega Sicilia Unico and a 2005 Ch. Haut-Brion.” Marco Ferraresso (Guado al Tasso) – 2013 Guado al Tasso Matarocchio “I have always spent the Christmas holidays at home with my family. It may seem trivial but it is an opportunity to open something of my own with them, as the rare times I haven't done so they almost got offended! This year will be an opportunity to let them taste the 2019 Guado al Tasso which represents a lucky and sought-after vintage for me. Lucky because mother nature has been merciful, sought-after because it goes in the stylistic direction that we like for this wine. Another wine that I would like to open for them is 2013 Matarocchio. With this vintage the Cabernet Franc has kept a strong varietal identity with a beautiful balance between acidity and tannic structure, a wine that should be in its full maturity and with which I hope to give a moment of happiness to my loved ones."  Christian Leusder (East Asia Whisky Company) – Ch. Rauzan-Ségla “It's really the simple stable stuff that takes centre stage during Christmas drinks. To start the evening a nice crisp Yebisu, Asahi SuperDry or a Suntory Premium Malt. The main course usually goes well with sake or red wine, depending on the cuisine of course. My favourite reds this year are Ch. Rauzan-Ségla's Margaux or Ch. Pape Clément from Pessac. When it comes to after-dinner drinks: the one and only Christmas spirit is Irish. One name that kept cropping up when speaking to winemakers about wine and cheese pairing was Bernard Antony, a man who now supplies 20 of the world’s 3* Michelin chefs as well as working alongside many of the world’s top winemakers matching cheese and wine at events for Guigal, Angelus, Humbrecht and many more.   We caught up with Jean Francois Antony (Bernard's son and protege) to find out more about Affinage (the ageing of cheese) and their perfect cheese and wine pairings. 45 years at the service of taste Bernard Antony is one of the world’s great cheese makers. Strictly speaking, his mastery
is in affinage, that is finishing and ageing cheeses. From humble beginnings working as a travelling grocer in Alsace, in 45 years he has gone on to become one of the most recognised men in the world of fine cheese.  Bernard Antony was the protegé of the late great Maitre Pierre Androucet – known as “the Pope of Cheese”. Bernard says of Pierre: "To me, he was like a father. He was the man who created me, who taught us everything, to my wife and me. He didn't like me to say it because he wanted to give me all the credit for my success”.  Following on from Androucet’s advice and support, Bernard set up his own cheese ageing cellars in the early eighties in the southern Alsace village of Vieux-Ferrette. The ageing cellars are made up of seven different chambers all at different humidity and temperature levels – ideal for raising and ageing various different styles of cheese. Only when the cheeses are deemed ready and at perfect ripening are they released to the markets and delivered to restaurants. Ageing of cheeses can range from just a few months for the fresher goat’s cheeses to several years for some hard cheeses. Speaking with Jean Francois Antony, Bernard’s son, who works alongside his father, running the day-to-day operations of the cellars, he identifies that the skills in good affinage revolve around a number of key elements. First of all, “raw (unpasteurized milk) is essential if one is to speak of cheese with authenticity…taking into account the breed of animal, the animal's diet, the talent of the cheesemaker and then of course the controlled process of ripening are also key”. The cheeses arrive at the cellars already halfway through ripening and their ageing cellars go into action to give them the final touch. They provide the perfect environment and temperature for ageing as well as the most important element in the Bernard Antony cheese cellars, the natural yeasts that live there helping the cheese mature distinctly and in the best way possible. The famous ageing cellars are open for visits in the village of Vieux-Ferrette. If you are travelling through Alsace it is an essential visit. Book via their
website. They often pair the cheeses with fine wine so we thought who better to ask for advice on the ultimate cheese and wine pairings than the man himself.  Below is the Bernard and Jean Francois Antony’s essential guide to food and wine matching, split up between the different styles of cheese, with additional advice passed down from Pierre Androucet.  The Floury crust family of cheeses Camembert        Brie de Meux (un peu sale)         St Marcellin and St Marcellin (runny)     Petit Mosellan         Coulommiers         Chaource
 The classic pairing would be Champagne (Blanc de Blancs, Aged and even Rose Champagne) however Bernard Antony advises that you remove the crust as it can make the wine appear more harsh. The bubbles work brilliantly in refreshing the palate from these rich cheeses and the yeast flavours from the Champagne also work really well. Avoid tannic reds with these cheeses. One of Bernard's favourite matches include a Gevrey Chambertin 2012 from Domaine Denis Mortet with the St Marcellin. He states a white wine with both gentle oxidation and good acidity works particularly well with Petit Mosella (Saint Peray from
Domaine Tunnel or Alain Voge) or a fruity red wine with well-coated tannins such as a Beaujolais Cru wines with the Chaource and Colombier fermier. The Washed Crust family of cheeses Epoisses       Langres         Livarot     Munster  Maroilles    Vacherin         Pont-l’Eveque According to Androuet: robust and virile wines, with sap and generous bouquet work best with these potent washed crust cheeses. They require “solar wines“ which can harness the power of washed crusts. Gewurtztraminer Grand Cru from Albert Mann, Chambolle Musigny from Liger Belair would both work well. Pinot Noir from Zind Humbrecht, Bollinger 2008 Grande Annee also a particular favourites with Bernard Antony. The pressed crust family of cheeses Comte     Emmenthal        Beaufort         Gruyere Suisse According to Androuet the matches depend on the evolution of the cheese. Dry white or red wines with bouquet work well, red wine brings a balancing touch of bitterness. These cheeses flatter any red wine by erasing astringency and promoting fruit therefore making White or Red Burgundy a good match. With more ageing of the cheese, wines from the greater South-West, the Rhône Valley and Languedoc Roussillon become better matches. Other personal
favourites from Bernard Antony include Vernaccia di San Gimignano (Italy) White
wines from Valais (Switzerland), and Savignin wines from the Jura. The pressed (uncooked) crust family of cheeses Morbier   Tomme de Savoie fermiere       Mimolette demi étuvé         Salers     Roblochon  Sainte Nectaire Pairing again depends on the maturity of the cheese. The older the cheese the richer the wine. Chateau Latour 2001 is Bernard’s match with Morbier. Saint Joseph Pierre Gonon 2013 works well with Reblochon and Chateau Canon La Gaffeliere Grand Cru Classe St Emilion 2008 works well with Saint Nectaire. The family of blue cheeses Bleu d’Auvergne     Roquefort        Fourme d’Ambert      Blue de Gex          Stilton    Gorgonzola These are best paired with sweeter fruited wine or sweet wines. Avoid red wines as the mould changes the structure, the aromas and brings out the bitterness. Top picks are Rivesaltes Vins Doux Naturels, Pacharenc du Vic Bilh or aged Sauternes even red Vins Doux Naturels such as Maury, Banyuls work well with blue cheeses. The family of Goat and sheep cheeses Ossau-iraty         Brebis cremeux et parfume Brebis Corse     Chevre Frais    Chevre Moelleux et onctueux   Chevre Affiné. Vieux et sec   St Maure de Touraine Banon de Provence Chevrotin des Aravis With this family of cheeses the wine must tame the acidity of milk. The wine must work with the texture of the fat and complexity of the flavours. Androuet confirms the well-known phrase – match local wines with cheese of the same origin, particularly very dry and fruity whites. Dry white wines from the Loire – include the smoky Pouilly Fume, Sancerre, Menetou-Salon, Quincy and Reuilly work well with the goats cheeses from the region. From Burgundy, try the lighter Aligoté, Saint-Véran, Macon villages and from the Alpine pastures the white wines of Savoie or lighter reds of the Loire – Bourgueil and Chinon. Bernard Antony’s particular favourites with these cheeses include wines closer to home including Riesling Vendange Tardive 2007 from Barmes Buecher, 2002 Brundlmayer Gruner Veltliner Kaferberg 2002 and Pinot Gris Grand Cru Osterberg 2016, Domaine Agape. We learn a lot from winemakers around the world but often it extends well beyond their vocation. No more so than with Champagne Henri Giraud winemaker Sébastien Le Golvet, whose philosophy as a vigneron extends far beyond the vineyard. Under the mentorship of his father-in-law Claude Giraud, Sébastien believes a total immersion in one’s surroundings is essential to better understand it. Working with something that is alive, Sébastien believes, requires the nurturing of a symbiotic relationship between himself, his vines and more broadly with the natural world.  Henri Giraud, one of Champagne’s most celebrated producers, takes this immersion philosophy to the extreme, from tasting their own soils to identifying varying terroirs of oak within the Argonne forest that produce the barrels for their barrel-fermented Champagnes. Sébastien guides us through the extraordinary lengths they go to, his determination to reconnect with nature, and learning to trust one’s senses.  Inquisitive wine drinkers are eager to extrapolate why doing something in the vineyard or the winery leads to the flavours in the glass. When speaking to a vigneron it is rare to receive straightforward answers, but as Sébastien explains, it is a succession of small details. In Henri Giraud’s case, a minimum of 10 years of activity and adjustments go into a single glass of Henri Giraud Champagne, as well as a lifetime of experience to help guide decisions throughout the process.  Sébastien compares his winemaking philosophy to climbing a mountain: there are many ways up and some options are more difficult than others, some can even lead to a fall, but each time he tackles that mountain, he claims he emerges with a better understanding. He remembers the pitfalls of previous vintages, or fermentations that go wrong, he takes inferences that might have led one way and chooses a different direction. Slowly finds the right path while remaining humble to the many routes available.  The multitude of factors at play in growing grapes and making wine, explains Sébastien, means a vigneron has to learn to trust one’s own sensibilities. His inferences are broad and multifaceted and not necessarily linked to winemaking. He talks about how important childhood memories of picking fresh cherries as a young boy, or the smells of his mother’s cooking, are, all providing him with a memory bank of senses that he refers to today.  100% barrel fermentation The domaine has had a fascination with oak from the Argonne forest, east of the Champagne region, since Claude Giraud took over from his father in the 1980s. Its top cuvee is even named after the forest (home to their barrels) of which 100% new oak is used in fermentation of their Argonne cuvee. Oak plays a central role across the range, with the sole exception the amphora-fermented Dame Jane Rose.  Since 2016 they have stopped using any stainless-steel tanks at all in the winery, even with their “Esprit” entry-level cuvee. Historically there were more than 150 coopers working in the Argonne forest producing barrels for Champagne production, but with the introduction of stainless-steel fermentation tanks, this tradition almost completely died out in the region. The cheaper more efficient effects of stainless steel led to most Champagne houses giving up on barrel fermentation. The obsession with oak at the domaine was not a whim. Initially, Claude Giraud invested in stainless steel to test and compare the effects of different fermentation vessels on the wine. They also tested extensively with different types of amphora including cement and terracotta before eventually opting for sandstone jars, offering the right amount of porosity to imprint texture and flavours, they are looking for. The problem with stainless steel, in Sébastien’s view, is that it doesn’t retain the tension in the wine in the same way as oak barrels; they don’t believe it translates their beloved Aÿ terroir. The reasons might not be clear cut, but their evidence in extensive tasting was enough to convince.  Sébastien states that the exchange during fermentation is much quicker in stainless steel, just two months, whereas in barrel it is between six to 12 months. This long exchange of solids, yeast and lees, according to Sébastien, creates much better equilibrium in the wine, more texture and more complexity. The small volume vessel (the barrels are just 228 litres) also creates more power and intensity in the wine.  Dealing with smaller vessels, according to Sébastien, also means more control of the product and less concerns with oxidation lowering the need for additions of sulphites (anti-oxygen agents) as well as giving Sébastien so many more options when it comes to blending. Each vintage he is managing over 1,000 barrels. While it sounds like a lot, in Champagne terms this would typically amount to four or five large tanks (maximum 10 smaller tanks) which when considering the Henri Giraud domaine has over 200 different separate vineyard plots, fermenting these all together in stainless-steel tanks would lose the specific terroir inferences that remain a vital element to the Henri Girard philosophy.  The terroirs of the Argonne Forest While Krug, Bollinger and Selosse are strong advocates of oak barrel fermentation in Champagne, perhaps the most unique element about Domaine Henri Giraud is the lengths they go to in determining what oak they use. Henri Giraud believes the terroir of the forest plays an essential role in the final effects in their wines. The wood is sourced from the Argonne forest but within the forest based on the varying soils, different parts of the forest offer different expressions. The domaine has identified at least 10 distinct terroirs within the Argonne forest. The three main regions they predominantly source from are Les Châtrices, La Contrôlerie and Les Haut-Bâtit. What is important about these specific terroirs, according to Le Golvet, is the geological positioning of the tree and the specific soil: a very poor, dry soil, causing the trees to grow very slowly producing wood with the tightest grain in the forest.  The tighter the grain, the more delicate the effect and flavour of the wood has on the wine. For Sébastien, the wines of Aÿ are very delicate and while they want to incorporate the terroir of the forest into the wine, they don’t want to overpower it. These trees take up to 250 years to reach maturity and thus Henri Giraud has partnered with the French National Forestry Office to invest in replanting programmes. For Sébastien, each of the terroirs brings distinct characteristics to the wine. The oak from Les Châtrices can emphasize the effect of acidity in the final wine as well as mineral freshness. The oak from La Contrôlerie brings red fruit and apricot notes. The oak of Les Haut-Bâtit brings power and depth and is often used in cuvees that lack the balance from maturity. How this all works they do not know, but again on tasting you can identify clear differences in the effect of using different oak from different terroirs of the forest. Sébastien is keen to share this with anyone who is interested. At Henri Giraud, they make a point of making their Vin Clair wine (still Champagne wine prior to the second fermentation in bottle) available to taste for visitors at the domaine throughout the year. They have the same cuvee fermented in the different types of oak for visitors to get a direct experience of how different they taste.
 Bespoke barrel toasting at the domaine One particular skill of Sébastien, seemingly fairly unique in the wine world, is that he toasts his own barrels. Trusting only his sense of smell and how specific toasts will affect different cuvees, Sébastien sources the barrels untoasted and toasts each one. Typically wine barrels are toasted for 30 to 40 minutes but he prefers a much lower heat but for around 90 minutes – sometimes longer –  depending on each barrel and using only his nose to guide him.  When the toasting process starts, he describes the wood smelling of flour, and as it cooks further the aromas develop to white bread, then darker, wholemeal bread, the bitterness of the green tannins drops out from the barrel and croissant buttered notes develop.  He identifies the character he is looking for, depending on the different vineyard sites, to produce a delicate balancing act between fruit and wood. Even before harvest, he has already decided how he will separate his 200 separate plots of vineyards, identifying which grapes will be fermented in specific barrels. The terroir of the Grand Cru village of Aÿ Transparency is a key part of the Giraud philosophy. They were among the first Champagne houses to farm organically, their vines have been pesticide-free since 1996. But whilst they are not officially certified, they believe recording the actual amount of chemical residuals found in the soil is a more transparent approach than an organic certification. They now identify on every bottle the molecular analysis of the wine via a QR code, identifying exactly what trace elements have reached the wine.    Receiving over 5,000 visitors every year, they are keen to share their philosophy of complete terroir immersion and transparency. Not only can you taste the different terroir effects on the oak, but they are keen to extol the virtues of the Grand Cru village of Aÿ. Sébastien explains how Aÿ has a distinct terroir, identifying key factors that resonate in the glass. The vineyards of Aÿ have a thin layer of very rich topsoil with high levels of iron oxide of which below is deep chalk mixed with clay.  The south exposition brings sun intensity that “roasts” the grapes, but a small river creates a fresh breeze that blows across the vineyards, preserving freshness. There is a distinct aniseed taste from the wines of Aÿ that brings freshness; the density of chalk, its structure and flavour can be tasted in the mouth as well as providing a distinct salinity. A part of their terroir immersion at the domaine involves tasting these elements with visitors, mixing the chalk, the clay and the iron oxide with water and tasting the effects in the mouth.  It is clear, explains Sébastien, that tasting these elements helps you to understand where you feel minerality in wine – where each element sits in the palate. Sébastien’s conviction in terroir immersion and the power of one’s senses is best extolled in the raising of his children. He has three sons aged between seven and 16 and from a very early age he and his wife were keen to immerse them in nature, to encourage them to explore their senses, and to connect them to nature. They spend much of their time in the vineyards, in the forests and the kitchen.  Sébastien recounts his memories of his mother’s cooking, the picking of fresh cherries from the tree – these are smells you never forget. He wants his children to savour these childhood memories, to help them build an extensive memory bank of sights, sounds and flavours. This immersion in their senses he believes is key to becoming a good vigneron of which he hopes his children (the 14th generation of the Henri Giraud domaine) will put into practice as Henri Giraud’s vignerons of the future. Terroir immersion therapy with Sébastien le Golvet

It’s often noted that Burgundians know nothing about Bordeaux and its wines – and vice versa. This is an exaggeration, though it retains a nugget of truth. These two great French wine regions are poles apart culturally. This is not a novel observation. Indeed, Jean-Robert Pitte, a professor at the Sorbonne, wrote an entire book, Bordeaux Bourgogne: Histoire d’une rivalité (2016), on this very theme. Just a couple of examples. In Bordeaux you will encounter people with names such as Basile, Vanessa, Diana or Jennifer – that would be inconceivable in Burgundy. This may be to do with the fact that Aquitaine was English-owned for centuries, or it may be that some Bordelais believe that an English name confers a certain cachet. At celebrations organized by the Chevaliers du Tastevin at Clos de Vougeot, and just about anywhere where Burgundy’s wines are praised and consumed, the ban bourguignon is an unavoidable part of the proceedings. It entails raising both arms in the air and twisting them in time to a raucous ditty with the words ‘Lala, lala, lalalala layla, lala, lala, la, la, la’. Can you imagine such a thing at Haut-Brion? Another striking difference is that Burgundy excludes, while Bordeaux includes, at least in terms of embracing those it considers helpful to its promotion, such as merchants, auctioneers and journalists. I have visited Burgundy and its growers every year for over three decades and can count on the fingers of two hands the number of times I have been invited to stay for lunch, let alone dinner. Without fail, a 10.30am appointment will come to an end at noon, and the visitor will be politely shown the door. Hungry after a morning of tastings? That’s your problem, monsieur. I used to find this irksome but soon came to understand that for the Burgundian, noon is the time when family members return to the homestead from pruning or tractoring or delivering bottles. It’s the sacred lunch hour, and outsiders have no place. You can taste from every barrel in the cellar, but that hospitality doesn’t extend to the dining room. It’s the exact opposite in Bordeaux, where it’s assumed that a visitor with a late-morning appointment will stay for lunch. Indeed, when researching one of my books in Saint-Emilion, I was amazed to find that my programme, organised with enthusiasm by the local syndicat, included lunch and dinner every day, weekends included. The Bordeaux proprietor will usually use the occasion not just to offer a fine meal, but to open some older vintages for the delectation of the visitor. The Burgundian really couldn’t care less. On one occasion, a grower with whom I spent a morning to research a profile for a magazine, had suggested, when I made the appointment, that I might like to stay for lunch. With pleasure, I responded, hoping that a mature Richebourg might be brought up from the cellar for my appreciation. But sur place, when I had completed my interview, it was clear that the owner had completely forgotten his offer. (However, after an embarrassing few minutes all around, his wife did rustle up a rather good meal.) Born to be hospitable Burgundy’s wine culture is about the nuances of terroir; Bordeaux is about selling wine that’s produced in far larger quantities than from patchwork Burgundy, and all those who can serve that purpose are corralled into a network of hospitality. A lunch will always take the same form. Coats and bags are deposited in the hallway of the château and one is led into a salon, where a small table supports a bottle of Champagne (often Pol Roger, sometimes Bollinger) and some glasses.  In comes the butler or maid (often on hire from the local traiteur, or caterer) with a plate of gougères or roundels of toast with foie gras to stimulate the appetite. Then the host rises to his (and occasionally her) feet and leads the way into the dining room. Lunch is invariably a butler-service event, so guests must calculate how much meat or veg to convey onto one’s plate without either appearing greedy or depriving others of their fair share. The dishes are always replenished, however, so seconds are in order. No need to panic. If the aim is to impress, it usually succeeds. In contrast, the Burgundians en fête are after a good time. Other than the rather forced jollity of the Chevaliers du Tastevin dinners, usually accompanied by indifferent wines, the highlight of the Burgundian wine calendar is the Paulée de Meursault (other paulées are available, but all agree that Meursault does it best). This is in effect a giant bottle party. Each producer, who may be accompanied by family or guests, will bring a basket stacked with a few bottles or magnums of a venerable or prized vintage. These will be poured and later circulated in the course of a five-hour lunch. Those lucky enough to attend can often taste spectacular rarities. This is not the Bordeaux way. At a formal dinner, for example during the en primeur tastings or Vinexpo, invited merchants or journalists will find themselves at a large round table in the company of two or three château owners or winemakers. They will have brought bottles – often very fine bottles – that will, in due course, be delivered to your table. There’s a certain amount of swapping with other tables to provide more variety, and certain journalists, towards the end of the evening, will be seen roving the room in search of wines to try on distant tables. (I plead guilty.) Here again, the aim is to impress. Brigades of waiters and waitresses, quite often students from a local catering college, will swoop in from the kitchen with such efficiency that a few hundred guests can be served almost simultaneously. Moreover, the food will usually be excellent, provided by one of the many highly professional traiteurs who flourish in Bordeaux. Access is the name of the game. The privileged guest, sipping Champagne or Sauternes during the prolonged apéritif hour before a grand Bordeaux dinner, will be in the company of dozens of château owners. Reach out a hand, even to someone you’ve never seen before but vaguely recognize, and it will instantly be shaken: ‘Bonsoir, monsieur.’ Everyone present is within the magic circle. You have been appointed, like it or not, as an ambassador for Bordeaux. Over 20 years ago I was present, along with 400 other guests, at the Fête des Vendanges, a great feast organized each year before the harvest by a leading château. I could see from the menu that 1985 Haut-Brion was to be the final wine of the evening, but what I hadn’t anticipated was that it was to be served in magnums only. Moreover, on a very warm evening each magnum had been lightly chilled before serving to ensure that it would retain
its freshness and digestibility in the glass. Other blandishments include guests of honour who are often prima donnas or celebrated actresses. Who wouldn’t want to be around when, as once happened, Gina Lollobrigida was escorted between the tables by the château owner? These feats of generosity, glamour and service are to be observed at all such events in Bordeaux. If you’re lucky enough to be present, it’s hard not to experience a wave of self-satisfaction. This warm embrace of the wine trade is not extended to mere consumers, of course. Although châteaux are more open to visitors than they were in the past, most wine tourists making their way up the roads that connect Margaux to Saint-Julien and Pauillac are confronted by closed gates or notices that read ‘by appointment only’. Some 25 years ago a delegation of Bordeaux worthies came to London to ask friendly journalists (over a good lunch, of course) what they could do improve the image of their region. ‘Try opening your gates,’ was my suggestion, and it did not go down particularly well. Fees, factotums and fixers Oeno-tourism has been slow to come to Bordeaux. Showcase châteaux such as Pavie, Smith Haut Lafitte or Lynch-Bages have become adept at offering tours and tastings, though at a price. A fee is understandable, as the cost of staffing the tours and the wines to be poured needs to be recouped. Napa does it differently. Visitors are courted, and the customary tasting fee will be refunded if you buy a bottle or two. In Australia, the ‘cellar door’ is always open for visitors to enjoy the wines and other merchandising. However, in Bordeaux, most prestigious châteaux make little effort to welcome visitors.  In Burgundy, top growers sell to a band of importers and perhaps a few private customers and restaurants. In Bordeaux, châteaux sell to négociants, who distribute their wines worldwide. Châteaux have no direct influence over who sells or buys their wines. That’s why it’s important to have influential writers and critics on their side. A high score from a wine guru may just persuade a group of merchants or consumers to buy Château X in preference to Château Y. And the other way around the following year. No wonder top châteaux treat the media with affection and respect. Consultants, too, form part of the hype machine. They are rarely present in Burgundy, where savoir-faire is passed down (not always successfully) from one generation to the next. But in regions such as Tuscany or Bordeaux, where estate owners are often rich and enthusiastic but short on expertise, the consultant is an essential member of the team. Nothing wrong with hiring good advice, of course. But choosing the right consultant also adds lustre to the estate. In Italy, take on Carlo Ferrini or Riccardo Cotarella and you can be certain, at the very least, of media attention. In Bordeaux, the consultant is more than an adviser on viticulture or vinification, suggesting how high your canopy should be or which coopers are best suited to your style of wine. They have influence too. Michel Rolland, notoriously, had the ear of Robert Parker for many years. This was perfectly understandable because, broadly speaking, they liked the same style of wine. I once asked a château owner with a group of properties why he had chosen a particular consultant rather than another of similar renown. ‘He’s good at what he does,’ was the reply, ‘but he also has a track record of getting his clients’ wines onto airline lists.’ Many of the older generation of consultants were invisible. In decades of visits to Bordeaux, I never encountered Jacques Boissenot, who advised most of the top estates of the Médoc, or Gilles Pauquet in Saint-Emilion. Others, such as Stéphane Derenoncourt, court importers and the press assiduously, with regular tastings that provide a showcase for all their clients. Wine writers like, for sound reasons, to be on close terms with consultants such as Derenoncourt, as they can be invaluable sources of information. Save time and score it? Admission to the magic circle of Bordeaux carries its own risks. I doubt there is much corruption as such – no wine writer of any importance would, I assume, be foolish enough to accept backhanders in exchange for favourable ratings – but what has happened is that independent assessment has been almost abandoned. And there are stories of bribes, often in the form of a few cases of wine, being offered. Newly minted bloggers would be particularly susceptible to a helping hand. Back in the 1980s or even 1990s revered critics such as Robert Parker would not hesitate to give a poor score to a wine he considered below standard. These days a poor score has become close to inconceivable. A score below 90 has become the equivalent of a smack in the face. In an article some years ago I predicted the scores that the major critics would give the 2014 vintage when, a few months later, the wines became available for tasting En Primeur.  My educated guesses, made without tasting a single wine, were alarmingly accurate. That, simply put, is because critics now score the brand and not the wine. No one is going to rate a first growth or scarce Pomerol at below 96; likewise, no obscure fifth growth or Côte de Bordeaux red, however fine, will ever be scored at 93 or higher. Bordeaux has succeeded in imposing its own self-valuations on its critics. Price has become equated with quality, as has been the case since the 18th century. This is why new owners of certain properties relentlessly push up their prices, because this is the best way to confer prestige on the wines. For Bordeaux as a whole, it may be a costly business organizing lavish dinners with superlative vintages, but it has paid off in establishing a group of wines as safely within the band of the world’s most appreciated and sought-after. For the wine critic, it’s a tricky balance. Without access, an article or vintage assessment becomes impossible. I am not immune. To research my own publications on Bordeaux, I have accepted offers to stay at comfortable châteaux for extended periods. I do my best not to let my judgment be swayed by this quid pro quo (which I disclose), but one can never be certain. Schmooze or you lose? It’s not only the wine press that is courted and pampered. Top châteaux will lay on lavish feasts for négociants and brokers too. Corinne Mentzelopoulos of Château Margaux once described such events as a way of thanking the Bordeaux wine trade for their success in selling her wines (not an arduous task, I would have thought). She intimated that it was also a way of keeping the trade on her side. Selling top claret in a great vintage is a doddle (except when grotesquely overpriced); selling the same label in a mediocre year such as 2013 is another matter. Maintaining brand loyalty – to Brand Bordeaux and individual châteaux – is crucial. By 2020 the region was having to face the threat of USA tariffs, the cold shoulder from China, the uncertainties of Brexit for the important British market, not to mention the growing climatic vagaries bringing drought, frost and hail in their wake.  Other challenges are stylistic rather than economic. A colleague who is involved in assessing the wine lists of top restaurants worldwide notes that there are a growing number of such lists that ostentatiously scorn Bordeaux in favour of, usually, ‘natural’ or other styles considered trendy. This is sommelier-driven, and Bordeaux producers and merchants are not always aware of how old-fashioned and stuffy their offerings appear to sommeliers (and their clients) in search of novelty rather than reliability. It’s hard for individual châteaux to promote their wines worldwide since they don’t know precisely who is buying their superb wines. In contrast, their Napa Valley equivalents stage auctions and other events targeted very precisely at super-rich clients and social media. Australia has its highly regarded agricultural shows, awarding medals that confer more prestige than most medals from wine competitions.  Bordeaux doesn’t have such marketing opportunities at its disposal, which is why generic marketing campaigns, prestigious tasting events, and the assiduous wooing of the media are such necessary tools. Whether they will continue to be effective as they have been in the past is undoubtedly open to question. When a wine is on "pre-arrival", it means that we have a confirmed order on the bottles from our supplier and we are simply waiting for the winery or distributor to ship the wine to us. The delivery timeframe for pre-arrival wines varies significantly, depending on where the wine is coming from. We will notify you once they arrive at our warehouse and, at that point, you can decide to arrange shipping or list them for sale.
