If you journey to the northernmost prefecture of Japan you will find Hokkaidō. Venture deeper into the Japanese island’s stunning national parks and forests and you’ll find its native quercus crispula – the mystical mizunara. Measuring up to 30 metres in height, with long, curved branches and broad leaves, the Japanese oak tree is undeniably majestic. In recent years, this humble tree, favoured by luxury furniture makers, has become an incredibly highly sought-after commodity in the whisky world for the slightly unusual characteristics of sandalwood, coconut and incense it imparts. It is so desirable, in fact, that a single barrel can easily cost 10 times the amount you’d pay for a standard Sherry cask. If you can get your hands on one at all, that is. Mizunara hasn’t always been as desirable as it is today. In fact, track back 10 to 15 years and very few people had heard of it, let alone deigned to put their beautifully crafted whisky in it. Its popularity neatly coincides with the sudden rise of Japanese whisky and Suntory’s decision to release a whisky that had been aged, albeit fleetingly, in this Japanese oak. What many didn’t realise at the time, and arguably still don’t to this day, is how problematic the mystical mizunara is to cooper, source and use as a maturation vessel. It takes approximately 200 years before a mizunara tree reaches the desired diameter for a cask (70-80cm). It doesn’t grow in a straight line, which makes creating staves a bit of a logistical headache for coopers. It has an extremely high moisture content (mizunara literally translates as water oak), and contains more knots than other woods, which is an issue when trying to make a cask watertight. It is also porous and prone to leakage. It's fair to say that it’s not a natural choice, and historically it wasn’t used in this way. Japanese distillers traditionally used European or American oak to mature their whisky because they were heavily influenced by Scotch traditions. But a shortage of casks during and after World War II forced them to look closer to home, to their native oak tree. Fast forward to today and the number of mizunara-finished whiskies is at an all-time high. As a consequence, mizunara barrels have only become more difficult (and expensive) to source. Andrew Rankin has worked in the whisky industry for 47 years – what he doesn’t know about casks isn’t worth knowing and his connections are enviable. None more so than his relationship with one of the oldest independent cooperages in Japan, from whom he sources a steady supply of mizunara for his new Scottish Highlands distillery Ardross. He describes the Japanese oak as a “fairly recent phenomenon” that was kickstarted by Suntory – a company he knows exceptionally well from his 20-plus years at Morrison Bowmore – where they filled an “absolutely tiny percentage” of Yamazaki into mizunara a decade ago. In the years that have followed, Rankin has been watching the mizunara market closely and is sceptical as to whether there is enough supply to meet demand. “It took me years to persuade Suntory to give us some mizunara casks,” he says. “At that time, I think it was 2010, we got three used mizunara casks and we got three new mizunara casks – and that was it. And it was a one-off. We weren’t getting a regular supply of it.” Even with his connections, Rankin says he doesn’t get a committed volume of mizunara each year because it is dependent on the level of deforestation and the quality of the wood. “We were due to get 20 [barrels] in at the beginning of this year,” he says, “but we still haven’t got them because of selection problems with the wood and shipping problems.” He’s hopeful they’ll arrive before the year is out, but there’s no guarantee. From the people I have spoken to, this lengthy wait is par for the course. East Asia Whisky Company’s Christian Leusder says it takes “approximately three years before you receive a good-quality mizunara barrel”. When you’ve parted with a staggering £8,000 per cask – five times the cost of a standard European or American oak barrel – it can be galling when other producers punt for a mediocre cask, which is only partly made from mizunara or is made from multiple trees, and sell their whisky for a similar price. These, arguably, poorer imitations can be with the buyer within a month or two because they take far less time to cooper and ship. Leusder believes the “massive” difference in cask pricing and considerable delay is worth it to produce something that isn’t just “bandwagon [and] off-the-rack”. Another bone of contention regarding mizunara is the length of time the whisky has spent in barrel, and whether the cask is fully or only partly made from the Japanese oak. Suntory UK Brand Ambassador James Bowker says the Japanese whisky behemoth is “lucky” to have a “relatively consistent, quality supply chain” that has been established over many years. These relationships enable them to fully age whiskies in single casks rather than cask transferring or finishing. “You’ll see this practice across our portfolio where we use mizunara,” he says. “It gives a more rounded, complex, tertiary profile rather than a simple hit of the primary cask notes.” However, Bowker is quick to acknowledge this expensive process which requires a “significant” time investment is not always possible – financially or otherwise – for some producers. Rankin says he really doesn’t know where all these producers are sourcing mizunara casks from because they are, naturally, far more scarce today than they were a decade ago. He is also sceptical about how long some of these whiskies have spent in mizunara and believes it takes at least five years to get any influence from the wood. “At the moment, you could put your whisky in a mizunara cask, roll it about on the floor, and say it is mizunara-cask-finished,” the Master Blender says. “And you probably know, and I probably know, that it is going on.” The people who don’t know, Rankin says, are the end consumers because producers are not currently required to be transparent about this on the label. East Asia Whisky Company’s Leusder picks up the point. “If you look at what Chivas Regal are doing, they are producing a lot of mizunara single malt whiskies which are just finishes and they don’t actually have an age statement so you don’t know how long they’ve been in there,” he says. “And I personally can’t really taste the mizunara out of it.” He continues: “Finishes can be gimmicky. They can go wrong. And they do not always yield the best product.” This is one of the reasons East Asia Whisky Company dips their toe in the mizunara pool but has no intention of fully submerging its feet. Its current Macallan mizunara series stops after the third release. A mizunara-finished Springbank and Bowmore release will follow, and then Leusder says the team might try and get their hands on a younger vintage and decide to age it in mizunara until the 40-to 50-year mark, when it will no longer be a finish. Dr Bill Lumsden, the genius behind Glenmorangie and Ardbeg for the past 26 years, has pioneered experimentation on every aspect of whisky production. It is telling that he has never released a product with mizunara oak in it. He says it is the taste profile, rather than sourcing and porosity, that puts him off the Japanese oak. “If I was to take Glenmorangie new-make spirit – and I’m neither confirming nor denying that I have done this – and mature it in a new heavily-toasted mizunara oak cask for 12 years, at the end of the day, I would have something that would probably taste a little bit bizarre,” he says. Lumsden says he always recalls doing a tasting in conjunction with The Glenlivet Master Distiller Alan Winchester and Suntory Chief Blender Shinji Fukuyo in London when Fukuyo presented a fully mizunara-matured whisky. Lumsden struggles to remember if it was Yamazaki but remembers the taste profile with crystal-clear clarity. He describes it in just two words: “bewilderingly strange”. Coming from a man who invented the Russian-oak matured Ardbeg Kelpie, which he says has elements of “the smell of burning rubber when a car has screeched away”, this is quite the review. Casting an eye to the future, there is little doubt producers will continue to release mizunara-finished whiskies – certainly in the short to mid term. Leusder says he thinks it will always be popular simply because it’s so rare, but predicts there will be a larger and widening gap between high and low quality. “There will be less and less of the high and more and more of the low,” he says, “and the market will be more and more confused as to which is which.” When pushed, Suntory’s Bowker says he absolutely thinks the trend will continue and other categories will start using mizunara. But, he adds with trepidation, that he hopes producers will “respect this special wood and ensure that consumers get to experience it at its best rather than being tempted by more affordable shortcuts as you so often see in this industry”. For the time being, at least, it seems like the mystical mizunara is going to continue to enchant producers and drinkers alike. And, unless things drastically change, the onus will be on the whisky drinker to watch out for the sorcery and find the magical liquid that undoubtedly exists. The grey horse stretches its neck out towards me, curling its lip towards my outreached palm, before nuzzling my pocket, in search perhaps of a potential snack. Its head is the size of my torso, its hooves the size of my head, with the entire beautiful beast weighing circa one ton, I’m told. You can sense the power of its immense muscled mass. Nearby, Adelaide Bonnefond, a petite 20-something is calling to the rest of her troupe of friendly giants. Balthazar – the aforementioned grey – is “a real lazybones”, Baudoin can be a bit fast and over-eager, while Olive is a horse of remarkable patience. “Each one has its own character,” Bonnefond says.  We’re in a field a stone’s throw from Ch. Pontet-Canet, where the property’s 10 horses spend their weekends and holidays. This Pauillac Fifth Growth is one of a handful of estates around the region, and indeed the world, that has returned to using horses in the vineyard – in lieu of modern machinery. Unusually, they have brought this operation in house – with their own stables and a five-strong team dedicated to grooming, handling and working the horses, led by Bonnefond.  “I have no idea,” says Mathieu Bessonet – the property’s Technical Director – when I ask how much it adds to their bills. “It’s not important for us… it’s a philosophy.” Herbicides were banned long ago at the estate, and they’ve been farming organically since 2004, certified organic and biodynamic from 2010 (the first Classed Growth to achieve the latter), with horses first introduced in 2008. They’re just one form of livestock you’ll find on the property. When I arrive, a drift of pigs is penned on the front lawn, tasked with munching on the invasive weed, common couch or quackgrass – but there are cattle and donkeys too. Collectively, they consume 60 tons of hay, three tons of barley and 600 kilos of lucerne (organic, of course) – much of which will end up back between the vines.  “A lot of money goes into taking good care of this place – what is in fact our tool for production,” says Bessonet. “The property is over 300 years old, so we’re just passing through. If I spend 20 years here, it’s a long time – but it’s only 3% of the history of Pontet-Canet. We have to take care of this place to be able to pass it on.” And working with horses is just one way in which they aim to do this, reducing soil compaction, allowing water, air and microbes to move through the soil. They can be more precise with their work and – most importantly – break fewer vines. A stunning number of vines are knocked out of place by tractors, something that is considered a natural consequence of modern farming – but not one that this estate is willing to accept.  “Wine, it’s made by the roots of the vines,” says Bessonet. As vines age, their roots creep further down into the soil and Pontet-Canet has some of the oldest vineyards in the Médoc, averaging 55 years in age. And it is the age of their vines, Bessonet feels, that “allows us to express the terroir”, as well as tempering climatic extremes (a growing concern with climate change). While it wasn’t a key reason for the shift back in 2008, using horses also allows them to reduce their carbon footprint – both by using fewer fossil fuels and increasing the carbon-holding capacity of their vineyards, something that is at the forefront of producers’ minds today.  The switch from tractor to horse has changed the way they farm more than can be measured in analytical results, however. “They are not little machines; working the vines with horses, we really become one with the vines,” says Bonnefond. The way you interact with an animal versus a machine is totally different, and she feels that as a result they are much more reactive, more aware of their work and able to stop at any moment. And, as Bessonet notes, even those that have worked at the property for 10 or 15 years can’t help but smile when the horses pass by. As any good manager knows, a happy team will pay endless dividends.  Back in 2008, they started with just two horses, but that number has grown to 10 today. They have a combination of breeds – Percheron and Comtois largely today, although they’ve had Bretons in the past. Percherons are larger, and they’ve been moving more towards Comtois, favouring the slightly smaller and even more gentle breed that hails from the Jura. All are draft horses, historically used in war and agriculture – weighing around double that of the daintier breeds you might see eventing or show-jumping.  Bessonet’s grandmother was, he tells me, almost insulted when he told her they were using horses – seeing it as a step backwards; but, as he and Bonnefond explain, the work is totally different to that of generations past. They might not be powered by electricity, but modern technology and know-how is being used to refine the way they work and the implements they use. Over the years, they’ve developed lots of tools themselves, and worked with a local business to craft others – a slow process that can only be tackled by those with a truly long-term vision.  They buy horses when they’re around three or four years old, so they’ve been broken in and have started their training but can be finished and finessed in-house (“They know the commands, but they’re still young so don’t necessarily listen,” explains Bessonet. “They’re teenagers!”). They’re unsurprisingly picky about the breeders they work with, and ensuring that the training received in their formative years is up to scratch. By the time the process is finished, the moment the plough touches the trunk of a vine, a horse will know to stop instantly, not even needing a human command, avoiding any significant damage. They have a mini faux vineyard with a handful of short rows lined with posts (but no vines) on the estate, a sort of school where they can train younger horses and use at the start of the season, spending half a day so the animals can get back to the pace of work.  Monday to Friday, the horses are at work, stabled next to the winery (with stalls crafted from old barrels). Each horse will work for half a day (sometimes longer if the tools they’re pulling are sufficiently light), before being walked back to the stables to allow for active recovery – evacuating lactic acid in their legs, something that is essential to maintain their health. With the time to groom, harness and unharness, wash down, muck out and feed the horses, each will work around three hours or so a day. Bonnefond’s team will take one horse out in the morning, before going back out with a different one in the afternoon. Alongside their work, the horses are lunged (moved in a circle around a handler, on a long lead rein) – working both on commands and their flexibility. “To change their minds too, seeing something other than the vines” explains Bonnefond.  There are around 10 passes per row a year, four or five to work the soils and around five others – spraying to protect pruning wounds (to prevent grapevine trunk diseases), making holes for planting new vines, spraying horsetail to control mildew pressure, as well as the 500 and 501 preparations (biodynamic sprays). Today, around half of the property’s 81 hectares is worked by horse – and the team is always working to do more, but Bessonet is unsure if 100% is a realistic goal. Copper sulphate – the main spray used in organic and biodynamic viticulture – is spread by tractor, not being something they’d want to expose the horses to (nor put gas masks on them, as was done during the Second World War).   The work is, inevitably, seasonal – and they’re turned out to pasture at weekends and during quiet periods, with lunging to keep them sharp. As soon as véraison takes place (the grapes changing in colour from green to red), “It’s holiday time for the horses,” says Bonnefond, laughing. At that point the grapes become too fragile and could be knocked by the horses, breaking the skins and damaging the fruit.   All being well, the horses work until they’re 18 or 20 years in age, and then Pontet-Canet finds them a home to live out their old age. Retirement can, in fact, be the hardest stage for these work-horses, explains Bonnefond. “They’re used to seeing everyone every day,” she says. One horse, Turbo, kept waiting at the gates, ready to go to work, for well over a month after he’d left the estate, struggling to adapt to his new, restful way of life.  Bonnefond had never worked in agriculture before arriving at Pontet-Canet, having been at an equestrian centre, and her team has similarly varied backgrounds (one used to train trotters and one worked with circus horses, for example). They’ve each got their favourites in Pontet-Canet’s herd, she confesses (hers is a handsome bay who is especially energetic), but they all work with each of the horses, to keep it interesting for the animals, and so that no horse gets too used to any particular handler.  It's certainly not light work – for Bonnefond and her team at least. Days are long and the work is physically demanding, but seeing Bonnefond in the field with the horses, her dainty frame at odds with the gigantic draft horses surrounding her, it’s clear that she loves it. Having a team like this in-house is something few estates can afford, but it’s reflective – as Bessonet says – of the philosophy at Pontet-Canet. Their special band of gravel terrace in the Médoc, shared with the likes of Mouton Rothschild, Lafite Rothschild and Cos d’Estournel – properties that represent the pinnacle of Cabernet Sauvignon around the world, deserves to be protected and preserved in every way possible.  Explore all current listings of Pontet-Canet or read more about Bordeaux

Taking the reins at Ch. Pontet-Canet

“It’s been an absolute pig of a year,” says Mark Gaskain. It’s September 2024 and we’re reaching the end of what has been a trying growing season across most of Europe – with seemingly never-ending rain. Fortunately, Gaskain knows that such challenges are just part of the job. He’s a farmer, born and bred, now at the helm of his family business, and responsible for growing 70 million apples a year. But in the last decade, he’s added a new strand to the business – after selling a swathe of land to none other than Champagne Taittinger in 2015. That land is now the home of Domaine Evremond – one of the most exciting English wine projects to date.  The story began almost a decade ago. Patrick McGrath – founder and CEO of Hatch Mansfield, which represents Champagne Taittinger in the UK – had been looking at adding an English sparkling wine to the company’s portfolio. It was the early 2010s, and he spied an opportunity with the burgeoning category – but Pierre-Emmanuel Taittinger suggested that, rather than taking on an existing estate, McGrath should create his own, working with Taittinger. Taittinger had embarked on a similar venture in California, creating Domaine Carneros with their US agent, Kobrand, under Pierre-Emmanuel’s uncle, Claude. Together, they decided to take the plunge.  They charged leading English wine specialist Stephen Skelton with helping them find the perfect site – determined to have chalk soils, south/southwest-facing slopes (for maximum sun exposure) at altitudes below 100 metres (with temperatures reducing by 1°C per 100m, anything above this would simply be too cold in England’s marginal climate). Kent – with easy access across to Champagne – was decided on, but it took them 18 months to find the right site. At the same time, the Gaskains were looking at selling some of their land (a foray into soft fruit had proven challenging, and were looking to get back to their core business of apples). The timing was fortuitous and the orchards at Stone Stile Farm – around the village of Chilham, southwest of Canterbury – were perfect. As Alexandre Ponnavoy (Chef de Cave for both Taittinger and Evremond) told me, if a site can grow good fruit – it’s a good indicator for its viticultural potential.  In 2015, the deal was signed and the project launched with great fanfare at Westminster Abbey. Domaine Evremond takes its name from Charles de Saint-Evremond (1614-1703), a Frenchman, essayist and early ambassador for the wines of Champagne – bringing them to the court of Charles II – who is buried in Poets’ Corner. Although Didier Pierson – a grower in Champagne – had made English wine under the Meon Hill label, Taittinger was one of the first major Champagne Houses to invest in England (Pommery had bought vineyards in Hampshire in 2014). Unsurprisingly, press coverage was extensive: the Champenois were coming to make sparkling wine on our home turf – the French naysayers set to eat their hats as the world started facing up to fine English fizz.  Evremond’s first vines went in the ground in 2017, with more added in 2020 (the team set up at the local Premier Inn to tackle the work mid-pandemic) and in 2024. The land here has a layer of alluvial clay over its chalk subsoil which is part of the Paris basin, shared with much of northern France (including Champagne). Around Canterbury, however, there’s more flint in the soil – something that Ponnavoy feels shines through in the wine, giving it a mineral, reductive character. There’s also a definite maritime influence – moderating temperatures, but also bringing ocean breezes from Whitstable, which is just six miles away. For Ponnavoy, it’s the combination of the site’s chalky soils, maritime softness and sea winds – a “contrasting climatology” – that defines the Evremond wines.   Gaskain is deeply involved in the project – his in-depth knowledge of the land an invaluable resource, knowing where potential frost pockets lie, for example, or where the soil might be overly rich for vines. He and his team manage the site day-to-day, guided by Christelle Rinvelle (Taittinger’s Vineyard Director). Currently, they have 62 hectares of vines, split between 45% Chardonnay, 45% Pinot Noir and 10% Meunier. They planted Chardonnay on areas with the thinnest topsoil, allowing its roots almost direct access to the chalky bedrock, while the Pinot Noir and Meunier sit on the more clay/gravel-rich plots.  The vines are widely spaced (5,000 vines per hectare – half the vine density Taittinger uses in Champagne) and trained higher than across the Channel, allowing for better airflow (helping manage disease pressure) and a larger canopy (to aid ripening). While herbicides have never been used on the site and there’s a concerted effort to be sustainable, Gaskain is clear on the limitations of viticulture in Kent: “Organics is madness in this climate,” he tells me – as, perhaps, 2024 proved. While the team has vine-specific sprayers, Gaskain can also draw on his team’s orchard equipment too – a boon when conditions are challenging – and spray the entire site in one (rather long) day.  They harvested tiny quantities of fruit in 2018 and 2019, with the first commercial-sized vintage coming from 2020 (conveniently the grape harvest falls neatly between that of Galas and Braeburns). Early wines were made at nearby Simpsons, and from 2020, they set up in an old concrete barn on the site – with the entire operation run on a generator. In June 2022, they broke ground on a new winery (“We were over budget four weeks after starting,” says McGrath, with a weary smile). The same company that worked on the Channel Tunnel dug out 83,000 tons of chalk (around 2,000 lorry loads) to make way for the three-storey building that stretches 20 metres below ground. Designed by Reims-based architect Giovanni Pace, the idea is for the winery to blend into the landscape – rather than stand on it. It has the capacity to cellar 1.5 million bottles – all without expending any additional energy on cooling, thanks to its natural subterranean chill.   Works were finished in time for the 2024 harvest – a relief undoubtedly for the team. There is something charmingly British, slightly ramshackle and underdog about the operation – despite the very serious money behind it (£17 million invested so far, reportedly). “Everybody’s had to muck in,” says McGrath. He might be Hatch’s CEO and one of the Evremond founders, but he’s also the first to pull on his wellies to help with harvest – and has spent more weekends in the vineyard than anyone else. Vitalie Taittinger has taken over from her father as President of Taittinger, and McGrath’s daughter India is running the commercial side of Evremond – meaning the operation really is a family business, even if it comes with some luxury, Champenois-esque swagger.  With the Taittinger association, of course, expectations are incredibly high – something McGrath is painfully aware of. Talking to Ponnavoy – who is in charge of the winemaking at both Taittinger and Evremond – there’s been something very exciting about creating a project from scratch, even if it has come with some challenges too. He argued to keep the small 2018 harvest for the property only, allowing them to follow the wines in tank over several years, and get to know the site. It was a huge cost, and delayed the first release, but something he felt was crucial.  “It was really important not to do a copy of another sparkling wine, not to produce a… ‘style’,” he says. Their goal, instead, was: “To identify the terroir, to identify the soil, to identify the climate, and reproduce all that in the bottle. To find the Evremond identity.” Inevitably, there’s a temptation to draw comparisons between Taittinger and Evremond, but the team is clear that they are totally separate projects with very different DNA.  Working with English fruit, Ponnavoy felt it was key to manage the potentially biting acidity (and the wine sees full malolactic as a result), but – for him – the greatest challenge was to avoid a bitterness that he finds common in some English wines. Managing the phenolics to avoid this was, for him, therefore essential, while he also focused particularly on the bubble texture – working to get a very fine mousse, something that he believes sets the wine apart from the competition.  In time, Evremond hopes to make 400,000 bottles a year, although there are only 120,000 of its first release. There are plans to add a vintage and rosé cuvée once the vines have matured and they’ve gotten to know the site, but for now they’re only producing the non-vintage Classic Cuvée. Now, a decade after they bought the land, Edition 1 of the Classic Cuvée is set to be released. For a début, it’s an incredible result – perhaps not surprising given the pedigree of the operation. Incredibly fine, taut and layered with oyster-shell, iodine and flint, it’s a wine full of the promise of what Evremond can do.  Domaine Evremond’s Classic Cuvée Edition 1 will be released on Thursday 3rd April: contact your Account Manager to register interest or sign up to be notified here

In some parts of the wine industry, oak has almost become a dirty word. Many winemakers eschew its use, seeing it as something that homogenises varieties and styles with its overbearance, given its potential to dominate a wine’s final flavour. The use of new barriques in particularly has become less and less popular in varieties that are more prone to oxidation and whose delicate aromatic nature is lost to the perfume and spice of toasted oak. This certainly seems to be the case for the Italian varieties Sangiovese and Nebbiolo, for which there is a decided swing back towards more traditional, larger, old oak vessels that do not impart oak flavour to the wine.  Although Burgundy’s Pinot Noir and Chardonnay have a great affinity to new oak, its use is declining significantly. Today in the world of fine wine, terroir is the trumping card and if new oak is a barrier, then its use starts to be questioned – but the Bordelais have long been strong affiliates to long ageing in barrique and the additional complexity that this brings wine.   Amongst Bordeaux’s elite, there remains a strong endorsement for the continued dominance of oak. Hugely influential producers such as Ch. Margaux have no qualms about using 100% new oak. Winemaker Philippe Bascaules believes criticisms of overusing new oak are due to “the weakness of the wine” – rather than the power of the oak. For Bascaules, “The most important quality it brings is the evolution of the tannins,” – and this is something he is not willing to give up. After many years of experimentation, Ch. Palmer's Thomas Duroux (another of the region’s leading names) also believes the oak barrique is the vessel that best develops the tannin structure of a wine. For him, the 225-litre barrique provides the perfect ratio of wine to wood and level of oxygen exchange for “building the wine”, and thus creating more structural complexity. But for some vignerons, new oak does has its limits. Duroux himself is well aware of new oak’s ability to overpower other flavours and he tries to maximise structure, while not losing the primary fruit character and aromatic complexity of the wine during oak ageing. He has come to his own conclusion that the best approach is to age the wine in two phases.  From November to July, he ages the wine in 225-litre barriques (either new or one-year old oak). Then from the July after harvest to the following July, the wine is transferred to larger oak foudres (2,900-litre barrels). Duroux describes this second phase as, “the refining period, where the wine becomes more integrated, more delicate – without taking on oak flavour or oak tannin”. He started trialling this method in 2017 and now Palmer has 20 foudres in operation. For the 2020 vintage, 30% of the wine has been aged this way. Bruno Borie (Ducru-Beaucaillou), however, feels that the reason for using new rather than old oak is often misunderstood. It is not the flavour that is important, but the cleanliness of the vessel. With wines such as the reds of Bordeaux, where pH levels are fairly high, it only becomes more important, since the wines are prone to bacterial spoilage, something that plagued the region in the 1980s and ’90s.  “We don’t sell wood, we sell wine,” Borie says. “We just use new wood because it is clean and sterile.  Brett [Brettanomyces, which causes bacterial spoilage] is so dangerous.” Older barrels are difficult to clean effectively after use, agrees Margaux’s Bascaules, and when a barrel is beyond a year old, the risk of microbial spoilage simply becomes too high. For Duroux, the older barrels also develop a sulphate compound which can “dry out the wines”.   Oak flavours are undoubtedly integral to the flavour of Bordeaux – but even its strongest supporters are today more open to understanding and better controlling its effects. Although Bascaules has no plans to change how Margaux is made, he is excited to learn what the wine would taste like without oak.  Over many years working at the château, this is something he has never experienced and still does not know. He has plans to experiment with glass amphorae, the idea being that by knowing what Margaux tastes like without oak, it will help him better understand how different elements bring flavour to the wine. “Many flavours people assume are from oak are not,” he says. “Cabernet Sauvignon, for instance, can produce coffee-like flavours. Often it is the reaction of oak and fruit that creates the flavours together.” Using these new glass amphorae will bring a better understanding of Margaux’s DNA – or at least this is what he hopes. Borie also notes that long oak maturation is essential for extending the ageing potential of the wine, something alternative vessels simply cannot do. “We make wine for collectors, wines that can be cellared for decades. Bordeaux’s ageing potential is very important, it is one of its signatures,” he says. Since 2003, Borie has extended the time Ducru-Beaucaillou spends in oak from 12 to 18 months to further extend the wine’s 
longevity. “Longer maturation in oak brings a special textural complexity, a different level of integration – a melding of tannins,” he explains.  But there are others in Bordeaux committed to oak alternatives. One of the region’s top châteaux that has made a significant switch from oak is Ch. Pontet-Canet, which has been ageing 35% of its wines in concrete amphorae since 2012. For Pontet-Canet’s Justine Tesseron, “Too much oak hides too much of the fruit flavour.” The clay amphorae, she feels, “help to keep the freshness of the fruit and keep the purity of the wine”. Happy with the results, Tesseron is considering increasing its proportion in the future, convinced they aid them in retaining “a pure expression of what the terroir is giving us”.  But no one in Bordeaux is giving up on the oak barrel altogether. In fact, the strongest advocates of alternative vessels tend to think a combination of both is where you can achieve the most complexity. Guillaume Pouthier from Ch. les Carmes Haut-Brion is known as one of the more experimental vignerons in Bordeaux and was amongst the first to introduce clay and glass amphorae as an alternative to oak. He feels clay in particular is “very interesting” as it allows the same oxygenation as barrels but you keep the “freshness, you keep the first aromatics of the wine”. He has some 2018 still in clay amphora and it smells like it was just picked.   Ageing wine in glass containers, however, sees no exchange with oxygen, meaning “the tannins don’t evolve” and the resulting wine is “very pure”, something which he feels adds energy to a blend although can risk making the wine “too hard” if there’s too much. For Pouthier, small proportions of wine aged in clay or glass brings additional complexity to the wine, working in combination with oak-aged wine.   Despite these tentative steps into alternative vessels, some have been less than impressed with their experiments. Bruno Borie comically uses history as his guiding light: “Amphorae were used prior to the Romans. But the Romans introduced oak because they saw it as an improvement – they chose the gods of the forest. Being ancestors of the Romans, we should do the same.”  For the top growers in Bordeaux, such as Ch. Lafite, oak still remains an incredibly important element in their wine. With their own cooperage on site, they produce 90% of the oak they use each year, with the Grand Vin typically seeing 90% new wood. Lafite’s Jean-Sébastien Philippe believes that in addition to building volume in the wine, oak also adds important “aromatic and flavour complexity”. These additional layers of flavour are down to the skills of the cooper and, for him, are something that should be celebrated. “Light and delicate toasting – not vanilla or coconut – but toasted spice adds complexity to the wine,” he says. While Cabernet Sauvignon clearly has a great affinity to the barrique, Cabernet Franc and Merlot seem to have better results with larger oak foudres and amphorae. Nicolas Glumineau at Ch. Pichon Lalande is going to start trials with glass and concrete, having been really impressed by wines, in particular, aged in glass. “The more structured the wine, the better it is in terms of definition and tannic structure. I was impressed with the results with Merlot, but the Cab Franc was stunning,” he said.   Pomerol’s Ch. l‘Evangile is experimenting with ceramic jars, which they believe not only “preserves intensity, purity and freshness of the fruit, but causes a vortex [within the vessel] constantly moving the wine around, resulting in more contact with the lees, that brings a more rounded, silky texture to the wine” .  While their influence remains minor in the final assemblage, these new amphora advocates are convinced that their judicious use adds complexity to their wine – and oak alternatives look set to become a permanent fixture for many in Bordeaux. For châteaux, like L’Evangile, these experiments are happening in conjunction with a reduction in the percentage of new oak in recent years (from 80% to 50% for L’Evangile) and they are not alone.  Overall, despite the healthy levels of experimentation going on in the region, oak barriques still reign supreme in Bordeaux. In their trials with alternative vessels, many vignerons have fallen back in love with the unique properties of the oak barrique. Is Bordeaux over oak?

Closed Japanese whisky distillery Karuizawa is a phenomenon. For its entire operational life, it was barely known inside of Japan, let alone internationally. Yet today, its whiskies are recognised globally as amongst the finest and most age-worthy ever bottled and today is one of the most sought-after labels in the burgeoning rare whisky investment market. Bottles of Karuizawa continue to break all the records. Just last month a bottle of Karuizawa 52YO (1960) Cask #5627 became the most expensive Japanese whisky ever sold at auction, a single 70cl bottle selling for £366,000. So, what is it that drives the demand and what qualities do bottles of Karuizawa possess which others don’t?  Like most whisky distilleries, its origins are humble, and the astonishing demand is relatively new, closely paralleling the upward trajectory of the rare whisky market over the past ten years.  Limited production  By Scottish whisky distillery standards, Karuizawa had a short lifespan. Established in 1955 it was operational for only 46 years before being closed in 2001, a consequence of an economic slump domestically which impacted an industry with limited exports at the time.  Although now synonymous with single malts, the first spirit to leave the still in 1956 was destined for blending and this continued until a switch in focus and the release of its first single malt in 1976. At the time Karuizawa was said to be Japan’s smallest distillery and so the relatively short years it was active, coupled with a relatively low capacity to produce single malt, led to an always limited amount of whisky on the market. Moreover, after lying dormant for well over a decade, Karuizawa was eventually demolished in 2016 by its then-owners Kirin
Brewing Co, dashing any hopes of a revival. Karuizawa's unique character  Fitting for such an extraordinary distillery was its extraordinary location on the southern slopes of one of Japan’s most active (category A) volcanoes – Mount Asama. Named after the town in which it was based, Karuizawa is under two hours by train northwest of Tokyo and at the time of writing is the only town to have hosted both summer and winter Olympic Games
events.  The cold snowy winters, summers with up to 80% humidity and cool average annual temperature of eight degrees, creates specific atmospheric conditions ideal for whisky maturation. These conditions have been credited with creating the unique characteristics of Karuizawa single malt – the ability to age gracefully for many decades, whist retaining an abnormally high alcoholic strength and concentrated complex flavour. In terms of raw materials, it is rumoured that The Macallan may have been the inspiration. It is certain
that they sourced the same grain and wood having imported Golden Promise barley
from Britain and Sherry casks from Spain. Distribution  Had it not been for the formation of specialist Japanese whisky distributor Number One Drinks Co. in 2006, it is quite possible Karuizawa would have never entered whisky enthusiasts’ consciousness on the scale it has today. Founded by Marcin Miller and David Croll, it was after a cask sampling session in 2009 and after learning production had ceased, that they bid to purchase the distillery. The bid was rejected but a counterbid to
purchase the inventory was accepted after protracted negotiations making Number
One Drinks Co both owner and distributor of Karuizawa whisky.    Export markets beckoned and soon London-based retailer The Whisky Exchange and Parisian-based retailer La Maison Du Whisky would be blown away by what was presented to them and began bottling casks for an initially sceptical European market. Quality cannot be ignored however and a joint bottling in 2009 by the aforementioned retailers was compared with some legendary Scotch whisky bottlings when reviewed by respected whisky blogger Serge Valentin describing the Karuizawa 42YO (1967) Cask #6426 as “a Japanese masterpiece… once again, this baby reminds me of some old Springbanks. Say of the best sherried ‘Local Barleys’, if that rings a bell to you.” 95 points. Karuizawa-mania ensued, fuelled also by the success Japanese whisky was experiencing as a category on the international stage, most notably Hibiki and Yamazaki scooping numerous ‘World’s Best’ awards and receiving critical acclaim including the famous Jim Murray Whisky Bible award for Yamazaki Sherry Cask 2013 Edition, reported in the mainstream media as ‘Japan beats Scotland’.  The finite supply, increasing demand and sheer quality of the whisky meant Number One Drinks Co had an increasingly valuable commodity. Ever the purist, Marcin is reported to have soon tired of the spiralling secondary market prices and decided to sell off what remained of the reported 364 casks they originally owned and went on to found Japan’s first-ever gin distillery (Kyoto Distillery) trailblazing within a new category with Ki-No-Bi gin.    Presentation You’d be forgiven for being a little underwhelmed by the presentation of some early releases of Karuizawa. A case in point is the previously mentioned Karuizawa 42YO (1967) Cask #6426, which at the time was the oldest Japanese whisky. Now retailing for £20,000 inc VAT, it consists of little more than a glass bottle, white sticker label and thin cardboard box. At
the time of release however there was no precedent for the returns Karuizawa would achieve on the secondary market and at a release price of £250, considered expensive at the time, most were indeed opened and drunk.  Today, the most high-profile releases of Karuizawa are collected and displayed like works of art. The Karuizawa Pearl Geisha’s by Elixir Distillers are a stunning example of how the presentation can entice collectors and send secondary markets into a frenzy. They were a 2019 release exclusive to FINE+RARE and consisted of just 71 bottles of a 37YO Karuizawa and 172 bottles of a 38YO. When these two bottles are placed side by side, the
labels form a mirrored image of a Geisha visually as impressive as the whisky itself.  These were the fourth release in the series so not only were collectors desperate to get their hands on these two but also the previous editions and any future ones.  The future of Karuizawa No one knows exactly how many ‘new’ Karuizawa releases there will be. The remaining casks Number One Drinks sold are said to have gone to three buyers who control the market and have been releasing intermittently since. What we can be sure of is there is very little left to be bottled and we are witnessing the final years of releases after which the number of bottles in the market will only decrease year on year.  The story of Karuizawa is already legendary and it is one which cannot be repeated. For future generations of whisky enthusiasts all that will be left is the ever-decreasing supply and the chapter of Karuizawa in the history of Japanese whisky. In addition to the final releases however, there will be whisky for future generations which is intrinsically linked to Karuizawa.  Although the distillery site was completely demolished, the pot stills that created the unique ‘new make’ were rescued and are already producing spirit which is being laid down at Shizuoka Distillery. There was also one final run in the old distillery site in 2006 by Ichiro Akuto of Chichibu Distillery fame. In March this year, Opus One announced that they’d hired Meghan Zobeck as Director of Winemaking. It’s the first step in the transition as longtime winemaker Michael Silacci looks to step away from the business over the next five years. Silacci has been at Opus since 2001 and is a bonafide legend in the valley today – finding a suitable successor is no small task.  Zobeck wasn’t necessarily the obvious choice. She’s risen rapidly through the ranks of Napa’s winemaking elite – but only moved into the world of wine in 2012. That move was a leap of faith for Zobeck – an unlikely one for someone immersed in the world of NFL.  Zobeck grew up in Greeley, Colorado – “a cowtown” in her words, but one that happened to be where the Denver Broncos held their training camps each year. Throughout high school, she spent her summers working for the team – as many locals did. She went off to college (then pre-med), but kept working for the Broncos, moving to full-time while she studied for her MCATs.  In her senior year of college, she did an internship with the team, working with the scouts and sitting in the “war room” on draft day. “I loved the action, the fast pace of it,” she says. At around the same time, she realised that medicine wasn’t for her – instead she took a role negotiating player contracts for the Broncos, becoming one of only a handful of women in the job, and loved it.   It was a weekend trip to Los Olivos in the Santa Ynez Valley that sparked her interest in wine and – more specifically – winemaking. Back home, she found an ad in a local magazine for a homebrew shop – offering the chance to buy grapes during harvest. Soon she was experimenting, fermenting batches of wine in her basement and having bottling parties with friends. “I just saw how it really brought people together,” she says. She travelled to more wine regions and fell for the way wine combined science, creativity, history and community. The NFL had served her well, but it was time to take that leap and leave the Broncos behind.  She did her first vintage at Clos Apalta in 2012, and didn’t look back – doing harvests in Piedmont, Bordeaux and the Barossa, before zoning in on Napa – first at Stag’s Leap Wine Cellars and Screaming Eagle, then taking a job with star consultant Philippe Melka. Most recently, Zobeck was winemaker at Burgess Cellars – where she had free rein to shape the wines, from the vineyard through to the winery.  Zobeck first met Michael Silacci at Premiere Napa Valley – her first showing barrel samples from Burgess. Silacci came over to taste and then – in a clear display of approval – kept sending others her way. Zobeck was focusing on a fresher style of wine, a return to the Burgess of yesteryear, but was also working towards a regenerative approach in the vineyard – and soon discovered that the Opus One team was doing similar experiments. She and Kimberlee Marinelli – Assistant Winemaker & Viticulturist at Opus One – connected and started discussing everything from pollinators to native ferments. Zobeck was struck by the clear lack of complacency from a property that had no need to prove itself further. Little did she know that Silacci was observing what she was doing with particular interest – and decided she could be the heir to his throne.  “It’s a job you never, in a million years, think is going to become available,” says Zobeck of the moment she was approached about becoming Opus One’s Director of Winemaking. There was no way she was turning down such an opportunity – especially not when she would have the chance to work with Silacci for several years.  Zobeck will take on Silacci’s legacy at Opus One – an estate that has been constantly evolving during his tenure. Organic farming has been the norm at Opus for over two decades, although they only sought certification in 2021. For over a decade, Silacci trialled biodynamics but found the vines became too vigorous. He abandoned the approach before launching into regenerative farming from 2022. The estate now works with permanent cover crop between the vines, helping lower temperatures in the canopies, retain water in the soils and lengthen the ripening period, without increasing sugar levels. Silacci has been experimenting with dry farming since 2007 and reducing irrigation across the estate, although it remains essential for now. The team hopes, however, to be able to dry-farm a new site in Oakville once the vines are established. This work is all reflected in the wines being produced today.  “Opus One is not the stereotypical Napa of the early 2000s,” Zobeck emphasises. “It’s a fresh style, and to keep that we have to farm differently.” Silacci is famous for saying he doesn’t want his footprints in the vineyard or fingerprints on the glass, but Zobeck notes how you can see his influence on Opus One over the years, especially from 2004. From 2019, however, she feels the wine has evolved further – with greater transparency of the site. The 2023 has just been bottled at a modest 13.5% alcohol – indicative of the estate’s current approach, one that she intends to continue.  Silacci plans to stay for at least three years, working alongside Zobeck as Chief Winemaker. A transition period of this length is testament to Opus One’s long-term view – looking not just at the next vintage, but the next decade and beyond. Zobeck’s excitement for the role is clear – as well as her admiration for the existing team. As in the NFL, a good captain is key, but it takes more than one player to win a game – and Zobeck completes an already impressive line-up. It’s one hell of a hand-off. Originally a joint venture between Robert Mondavi and Ch. Mouton Rothschild, Opus One is one of Napa’s most famous estates – and it now has a new Director of Winemaking. We sat down with Meghan Zobeck to find out more about the ex-NFL powerhouse taking over from Michael Silacci

I was hesitant about meeting Ivan Massonnat. The man who created Domaine Belargus seemed to fill easy stereotypes. A background in private equity. Lived in Paris. A passion for wine – and a dream to make it himself. Big scores and some pretty punchy prices for a brand-new estate from the Loire. Reading between the lines, I feared there was a lot of cash and possibly too much polish. Thankfully, I was wrong.  Created in 2018 and based in Anjou, Domaine Belargus has rapidly become one of fine wine’s hottest new names. The first wines were released in 2021, in the midst of the global pandemic, but had already earned serious acclaim. Yohan Castaing wrote in Decanter, “Remember this name, as its production should meet with resounding critical success in the coming years.” The wines received glowing reviews in Wine Spectator and the Wine Advocate – where Stephan Reinhardt declared it “one of the most spectacular new entries in the history of [the publication]”, granting a coveted 100-point score for its 2018 Quarts de Chaume Ultra. But that was just the beginning. Ivan Massonnat is a man with big plans – both for his own wines, and the region as a whole.  Wine was a part of life for Massonnat from a young age – with his grandfather farming a small vineyard in their village in the Savoie. But, despite helping at harvest time each year, he didn’t end up drinking wine until he was 20, when he was “instantly hooked”, he says. He fell in love with Burgundy and the concept of “vin de lieu” – wine of place.  Massonnat made his money in private equity, based in Paris but travelling the world, where fine dining – and fine wine lists – only fed his terroir obsession. Two decades ago he was looking for a country house for his family, and – not having a car – settled on the Loire. “The more I was spending time there, the more I realised that the region was totally misunderstood,” he says. Prior to the upheaval of the French Revolution and the subsequent arrival of mildew and phylloxera, the Loire was one of France’s most prestigious wine regions – home to the nation’s kings, the fruit of its vines were the royal court’s natural choice. Post-phylloxera, however, quality was scrapped in favour of quantity. “Its image started to blur,” says Massonnat.  Combine the region’s history with its two great, native varieties – Chenin Blanc and Cabernet Franc – and Massonnat saw “an incredible diamond in the rough”. Wine had become an increasingly large part of his life – tasting widely and visiting producers as much as possible, especially in Burgundy where vignerons such as Philippe Pacalet and Thibault Liger-Belair friends and mentors. But it wasn’t just a hobby – Massonnat was starting to think this could be more, the adventure that lay beyond the world of finance.  As the adage goes, the world of wine is a brilliant way to make a small fortune – provided you start out with a large one. Massonnat, however, didn’t underestimate the challenges and set about getting to grips with the mechanics of the business. “It started really to become a project 10 years ago,” he says – talking to importers, consultants, journalists and merchants. And, perhaps unsurprisingly given his successful career, Massonnat wasn’t looking to make any wine – he was determined to create something exceptional.  After a failed attempt to buy a Chinon estate in 2015, he turned his attention to great Chenin Blanc sites in Anjou Noir, between the Layon and Loire rivers – low-yielding hillsides where producers were struggling to make money and consequently there was land to buy. More than just availability, it was here that Massonnat saw great potential. The area’s dark, schist soils (cause for the “noir” in the region’s name) were littered with tiny appellations, echoing those of Burgundy, with a much hillier landscape, and the only Premier and Grand Cru vineyards in the region.  Between 2016 and 2018, Massonnat started visiting every vineyard he could find – looking for the exceptional. Then the local winemaker Patrick Baudouin introduced him to Jo Pithon – a legend of the Loire. Pithon had been making wine since 1978, a pioneer of organic farming, crafting fine dry and sweet wines – but the talented vigneron was by no means a businessman. By the early 2000s, his lack of commercial knowhow lost him the rights to his name, along with the majority of his vineyards – all but one plot, the Coteau des Treilles.  Massonnat met Pithon at the Angers wine fair in 2018; they got on well enough and he arranged to see Pithon’s vineyards the following day. The next morning, it was snowing and he regretted his decision . But then, at 8.32am on 6th February 2018, “It’s as if I was struck by lightning,” Massonnat says. Pithon had brought him to Coteau des Treilles. Long farmed organically, it has slopes at a gradient of 70%, embedded in a natural reserve, with a Mediterranean microclimate – and Massonnat knew instantly it was what he had been looking for. He bought the Pithon-Paillé operation that Jo Pithon had created a decade earlier.  Luck continued to be on Massonnat’s side – and he bought two other vineyards over the next six months, adding to his collection of prime sites. He managed to buy a quarter of the Quarts de Chaume appellation – the only Grand Cru vineyards in the region – which amazingly had been on the market for 10 years. “Nobody wanted to buy it… They were looking at it as a sweet wine terroir. But actually, a great terroir is a great terroir… you will do dry wines that are quite exceptional,” Massonnat explains. Then he snapped up a parcel in Savennières – the only plot to have been sold in the last seven years.  He hired a young team and Pithon stayed on to consult – and the real work began. “Belargus is a 100-year project. Everything we do, we have that horizon,” Massonnat says. The vines are all organically certified, but they’re now working towards biodynamic accreditation. Yields are low, and they’re trying gradually to increase them to around 35hl/ha in a good vintage (currently the highest they’ve managed is 29hl/ha). “Our obsession is to have the right maturity,” Massonnat explains. To battle Chenin Blanc’s natural heterogeneity, they pick in multiple passes, minimum two or three but up to six, depending on the year – and that is just for the dry wines. The general approach is minimalist – with stainless steel and mainly larger, old oak, indigenous yeast, letting malolactic fermentation happen (or not), keeping wines on the lees and using only essential levels of sulphur. A new winery is being planned to take things to the next level, with, for example, a Coquard press (allowing especially gentle pressing, commonly used in Champagne).  The project is about expressing the different terroirs of this corner of Anjou Noir. The first release (which sold almost instantly given the hype from the critics, with 80% exported) consisted of 14 cuvées – nine dry wines and five sweet, focusing on nine specific plots across the estate’s vineyards. The dry wines are powerful, tightly wound and intense – as Massonnat says, “It’s not wine for every day,” comparing them to white Hermitage or Corton-Charlemagne, wines that need food and time. Although 90% of production is dry, Massonnat confesses, “We are obsessed with sweet wines.” These, he feels, are what will really set Anjou Noir on the world stage – if, perhaps, what he calls “the sugar pandemic” ever stops.   With Massonnat’s finance background comes a flexibility that few others have. He hopes to hold all the wines back four years eventually, but for now it is between three and four – and he was able to release the 2020s before the exceptional 2019s. It also allowed him to set prices unusually high compared to his neighbours. “I had the luxury to make that choice for the region,” he explains. “I wanted to break the glass ceiling.” And although he thought it would take time – his first release proved that there were plenty of people ready to snap up the value that these wines offered, including many of those now priced out of Burgundy.  And this is his real dream – for the Loire to be recognised as Burgundy is, as “a tier-one region which any collector needs to have in its cellar, that needs to be understood”. It’s easy to imagine other producers might have bristled at an outsider’s arrival, pitching their very first wines at unheard-of prices; but Massonnat is intent on leading the crusade for the entire region, not just Domaine Belargus. He volunteered to run the Paulée d’Anjou – a celebration of the region’s wines – in 2019, and made it bigger and better. In 2021, he became co-president of the Quarts de Chaume appellation, alongside Marie Guégniard from Domaine de la Bergerie. Together they are fighting for the appellation to permit both dry and sweet wines, as Savennières technically can, and Quarts de Chaume could until 1996. “Anjou was a dirty word. And look at the revolution now,” he says.  Like the precious blue butterfly that gives its name to the Belargus estate, Massonnat isn’t happy sitting still – and he’s already got another project – having had the chance to buy the Chinon estate he’d originally had his eye on in 2015. The best wine he ever tasted was a Chinon, a 1989 from Charles Joguet. “There was a whole civilisation in this wine,” he told me, trying to explain how moving the experience had been. The most famous vineyard in Argentina is named after Dr Adrianna Catena, who is the youngest daughter of pioneering vigneron Nicolás Catena Zapata. As well as her viticultural endeavours at Catena Zapata and her partnership with Alejandro Vigil as co-founder of the cult Argentine winery El Enemigo, she is a practicing historian.  Her area of interest is the 15th and 16th century Americas – a time when wine (and the vine) were first introduced to the continent following the Spanish conquest. The pivotal role of wine in Catholic ritual, and the dangers associated with drinking fresh water, she believes, would shape the development of wine production in the Americas. For Catena, the intimate relationship between wine and water continues to play a central role in shaping Mendoza’s social landscape.  The history of water and wine in South America is a fascinating topic for Catena. Although her PhD thesis focused on the trade in indigo dye from the Americas to Europe, her attachment to wine – as well as the very real concerns of water scarcity in Mendoza – are subjects important to her as a historian and as a vigneron. Through the Catena Institute of Wine (CIW), the Catena Zapata winery has pioneered research in viticulture across a broad rand of topics. It includes ground-breaking work on terroir, ageability, and soil biodiversity, as well as in depth studies on extreme elevation vine growing in a context of changing climatic conditions – but some of their most pressing work centres around water preservation.  “Water preservation is one of our most important areas of research today,” says Catena. “Organic farming is easier in the very dry climate of Mendoza, than in Bordeaux, where higher rainfall and relative humidity mean vineyards will be more susceptible to fungal diseases – for us, when it comes to a sustainable future and regenerative farming, water preservation is key.” Catena Zapata’s head viticulturalist Luis Reginato is nicknamed “the water guy” at Catena – such is his obsession.  “He’s always trialing new, experimental ways to save water.” But she notes, the region has a long successful history of water management for Reginato to tap into. “The irrigation systems developed by the native Huarpe people before the arrival of Europeans were key to successful agriculture in the region, and these systems are still in use today,” says Catena.  For centuries, irrigation channels and aqueducts have diverted water from the Andes mountains to terrace lower Andes farmlands, bringing fresh drinking water to the cities. The Incas, Catena says, whose power extended briefly to this region, were quite unique among early modern empires in the quality of their nutrition and a notable absence of famine – made possible by terraced agriculture on the Andean slopes and complex irrigation systems.  While advanced water networks had been essential to pre-Hispanic and later colonial agriculture, Europeans treated drinking water with caution. “Up until the last century, it was a common belief that water, especially in exotic or tropical regions, could be bad for your health,” says Catena. “Contaminated water could (and can still) kill you and was considered extremely dangerous.” Wine in many parts of Europe (and the Americas, following the Spanish conquest) along with ales and beer, was often considered a safer option. Where they felt there was no access to clean water, wine became an essential part of the diet.  Wine was a key European import in the early days of the Spanish conquest, notes Catena. And for the Spaniards, it was not without its health benefits. “During this period, medicine was humoral, people believed everything you ingested would affect your mood, health, and disposition,” she explains. “In one claim from the time, ‘vino‘ (wine) came from the word ’vena‘ (vein) – it was considered nourishing, and closely resembles blood and was associated with this. Some believed it fortified the veins.”  But, as Catena explains, wine was more than a health benefit for the conquistador. “Wine was also an essential symbol of Christianity and Christianity was a moving force in the Spanish conquest.” The conquest of Mexico would roughly coincide with the start of Luther’s Reformation.  The Spanish, for their part, wanted to secure a triumph for Catholicism, and in the inhabitants of the new world, saw millions of souls to fill their ranks against the Protestants. “It was the conquistador’s mission,” she says. “Behind the conquest was a big effort to convert the native population.” Catena explains how wine – as with wheat – was a highly symbolic food for Christianity, representing the blood of Christ.  “If you are trying to convert an entire native population to Catholicism, rituals will be fundamental,” she says. Wine had always held a central role in religious ritual and was key to the religious side of the Conquest. Conquistadors, she explains, had to build a church on their land after being awarded territory by the Crown for their service – and they were also made responsible for converting the indigenous population. “In this quest, as one historian put it, to advance the religious and territorial conquest – the two basic foods the Spanish needed were wheat and wine.” Initially, all wine was imported from Europe, but vines were swiftly introduced and acclimated. By the 1570s vineyards had been planted all over South America, albeit under strict regulations. Priests, for example, were allowed to plant vineyards – but there was a lot of legislation over who could and couldn’t grow grapes. By the 1570s vineyards had been planted all over the Americas.  For health, religious and cultural reasons, everyone drank wine in 16th and 17th century South America – it was part of the diet, explains Catena. But as the influence of humoral medicine waned following the Enlightenment – and better sanitation practices were discovered – the perceived symbolic benefits of wine declined. As the population grew exponentially in the 19th century, so did wine production in Argentina. Italian and Spanish immigrants arrived on the continent, leaving behind their famine-stricken homelands. “Wine consumption reached extraordinary levels,” says Catena, “particularly with the development of the railways.” This new technology enabled the speedy, efficient transportation of wine from producing regions to the Argentine capital of Buenos Aires. Nicola Catena was one such immigrant, who arrived in Mendoza in 1898 at the age of 17, planting his first vineyard in 1902. A native of Le Marche, from a family of vinegrowers, it was not so surprising that Catena went into wine production.  While Mendoza is much like a desert with very little rainfall (between 200 and 400 mm per year), the irrigation channels developed by the indigenous Huarpe people (a nation periodically under Inca rule), were used to divert snow melt from the Andes, enabling farmers to flood farmland when required, making viticulture possible. By the time Nicola’s son Domingo Catena took over, the family had become renowned winemakers in Mendoza. In more modern times, wine and water’s relationship has changed considerably. Wine in many instances has become a luxury and no longer an essential part of the diet – although Catena says that culturally wine remains a common sight at every meal in Argentina.  Under the guardianship of Nicolás Catena and now his daughter Laura, Catena Zapata has become among a growing number of quality-led producers in Mendoza whose wines compete with the finest in the world. Their top wines – Mundus Bacillus Terrae and Nicolás Catena – led the charge in putting Mendoza on the fine wine map. Water too is no longer viewed with as much caution, but nor is it taken for granted. It barely rains at all in Mendoza – with the region effectively a high-altitude desert. Without snowmelt from the mountains, agriculture here would be impossible, but glacial reserves in Argentina are decreasing. With climate change, water in these parts will no longer be simply available at the turn of a tap. “The preservation of water has become an important concern of winemaking in Mendoza. This is one of the most urgent questions for our region today,” says Catena. Ongoing research at Catena includes many water-saving experiments. “More than a decade ago we transitioned all our vineyards from the traditional, but wasteful system of flood irrigation, to drip irrigation. Since then, we’ve created reservoirs to capture rainwater, and set up water stations to measure and restrict irrigation to the bare minimum in our family vineyards.” For Catena, “these small changes can have a large and lasting impact.” The goal at Catena is to manage a regenerative and sustainable agricultural cycle. Catena notes how the Incas were able to transform their environment without causing irreparable damage to it. “We can inhabit this earth without being parasitical,” she says. As members of a larger viticultural community, Catena hopes to share the lessons it has learned from its research, to enable this region that has been shaped by water and wine to continue making high-quality wine centuries from now. Optimistically she says, “We believe we are at a tipping point, and the mindset is gathering momentum here more than ever before.” Since wine was introduced to the continent in the 16th century, there have been huge cultural changes. But the irrigation systems that allowed those first vines to grow remain in use, feeding the countless vineyards, often centuries old. Without water, there will be no wine. With Argentinian wine so popular around the world today, a lot rides on Catena Zapata’s research. The hope is that they can lead the charge, shaping a bright future for this region.
