Introduction The Côte d’Or, the Golden Slope, enjoys a reputation and exerts an influence in the wine world out of all proportion to its size. It possesses none of the grandeur of the Douro Valley, for instance, nor the picture-postcard beauty of South Africa’s winelands. It is not majestic; its beauty is serene, and what strikes the observer time and again is the tiny scale. From north to south it is about 50 kilometres long, is sometimes less than a kilometre wide, and can be driven in little more than an hour. At a push it could be walked in a day. Yet for a thousand or more years this favoured slope has yielded wines that have entranced and delighted wine lovers, with a fair measure of frustration and disappointment thrown in too. Avoiding hyperbole when writing about the Côte d’Or is a problem, for it has held people in thrall for centuries, frequently prompting poetic flights of prose: ‘The Pathetic Fallacy resounds in all our praise of wine … This Burgundy seemed to me, then, serene and triumphant … it whispered faintly, but in the same lapidary phrase, the same words of hope.’ Thus wrote Evelyn Waugh in Brideshead Revisited eighty years ago. Literary critics might cavil at such prolixity, and Waugh himself tamed it severely in later editions, but it was enough to intrigue me decades ago and engender a love for the region and its wines that has never waned. Greater Burgundy is a bigger, more geographically diverse, region than might first be supposed, stretching from Chablis, south-east of Paris, to Beaujolais, north of Lyon. The subject matter of this book, however, is Burgundy’s heart, the Côte d’Or. There is no more celebrated stretch of agricultural land on earth. It has been pored over and analysed, feted and cosseted, obsessed about and sought after for centuries and today, if anything, it exerts a greater pull on wine lovers than ever before. ‘Astronomical’ does not begin to describe the prices now being paid for prized patches of grand and premier cru vineyard, and for the wines produced from them by the top domaines. Such prices hog the headlines and paint a dazzling, though severely one-dimensional, picture of the Côte d’Or today. In the early years of the twenty-first century they are part of the story but they are not the only part. This book aims to get behind the dazzle and flesh out the story, to add some nuance and extra dimension. The Côte d’Or cannot be captured in a sound bite nor, it must be admitted, in a book of this scope – but my hope is that it may add another chapter to the ever-unfolding tale, setting it in the early years of the twenty-first century, a period that may come to be considered by future historians as a golden age for Burgundy but which has brought its own challenges in the shape of those ludicrous prices, the scandal of premature oxidation in the white wines, and the increasing challenge of dealing with extreme weather events such as hail and spring frost. The Côte d’Or has been the subject of forensic scrutiny for centuries, generating a library of books, so why another one now? For the simple reason that it is ever changing. Every year sees new names added to the producers’ roster and old ones slipping away, and thanks to this ongoing evolution the infant domaine of today can be the superstar of tomorrow. The core of the book comprises about a hundred producer profiles. Many fine domaines and négociants whose wines I am happy to purchase and drink have not found a place here. It is important to stress that they have not been included, rather than excluded, simply for reasons of space. The aim was to feature a representative collection of producers, not a top-down selection of the most celebrated names in descending order of renown. As a consequence this book is not, nor was it ever intended to be, a comprehensive A to Z of producers. I write as an amateur du vin, an enthusiast whose admiration for the wines of Burgundy stretches back over four decades, and who has been visiting the region and writing about the wines for some thirty years. I do not trade in wine. I try to see beyond the wine to get something of the backstory, the story of people and place that makes the Côte d’Or so fascinating. To examine the wines in isolation is to dislocate them from that, and not knowing something of the backstory precludes a full understanding of them. A broad lens must be brought to bear on the côte. Too narrow, and the wood will never be seen for the trees. I have learned much by coming across things serendipitously rather than dashing hither and thither, seeing a lot but noticing little. Without time for assimilation and reflection, subtlety and shade are missed. Finally, no gustatory experience can match the thrill of a great Côte d’Or red drunk at its peak. The colour, crimsoned by age; the heavenly scent, perfumed with notes of sweet decay; a sauvage edge, the palate lively and tingling, managing to be so many things at once, oscillating between fruit and spice and meat and game, a merry-go-round of flavour, spiralling on the palate, refusing to be pinned down by anything so prosaic as a tasting note. All the primary components melded by age and yielding up new ones, unsignalled when the wine was young. Everything cohesive and in harmony, like a great orchestra playing at its best. Above all, vital and living, endlessly enchanting and intriguing, engaging the palate and the spirit like no other wine. Inside Burgundy – Jasper Morris MW  Côte de Beaune  Jasper Morris MW’s first assessment of Burgundy 2024 reveals a vintage of extreme adversity yet unexpected classical poise, particularly for whites. An “exceptionally wet year,” marked by poor flowering, mildew pressure, and limited sunshine, made 2024 one of the most challenging recent seasons. Conditions worsened moving north, with the Hill of Corton and northern Beaune hardest hit, while mid-slope vineyards benefited from better drainage and earlier flowering. Harvest was tightly compressed between 12–16 September.  Despite the difficulties, Morris calls 2024 “much more applicable” as a return to classic Burgundy than 2021, especially for whites, where quality is “relatively homogenous” and characterful. He found wines defined by citrus, fresh apple, and, at their best, “rapier-like acidity” and tension. These whites will be “accessible early,” though he warns buyers to avoid those lacking backbone and energy.  Reds are more mixed and occasionally fragile, yet the finest examples show charm and harmony. Morris highlights “aromatic pinots that could make you smile at first sniff,” with unusually refined tannins, aided by a return to a classical 100-day ripening cycle. Village wines and well-managed premiers crus represent the sweet spot of the vintage.  Chablis  Chablis faced the harshest conditions in 2024: floods, frost, hail, and relentless rain, with total rainfall reaching 634 mm and many organic producers harvesting below 10 hl/ha. Some, like Guillaume Vrignaud, “made hardly any wine and sold it off.” Morris expected “green… ugly and flawed” wines but found most were sound and “less fragile than their 2021 counterparts.” While few are truly great, many show classic Chablis character—crisp, defined, with “crushed oyster shell” notes. Best for short- to medium-term drinking, 2024 in Chablis demonstrates resilience and surprising drinkability after a punishing season.  Côte de Nuits  In the Côte de Nuits, Morris sees 2024 as a vintage of delicacy rather than power. Harvest ran 12–16 September, with Nuits-St-Georges hit hard by rain and further north affected by uneven conditions and hail. Losses came mostly from coulure rather than mildew, especially around Gevrey-Chambertin. Whole-bunch fermentation and reduced stem use were key, and while some wines need time to integrate, many show light, perfumed character. “If you like dark coloured powerful wines… there is nothing here for you,” notes Morris. Only 2% of wines achieve top accolades, making careful selection essential. Flowering was uneven, yields sharply reduced (Pinot Noir suffered most) and frost damaged parcels from Marsannay to Clos de Vougeot. As one winemaker reflected, “Each day in the vineyard felt like a battle,” capturing the relentlessness of the season. Tiny harvests demanded meticulous vineyard work and careful vinification, with whole-bunch decisions critical: “2024 was not a vintage to play recklessly with stems.”  A sunny, warm August offered salvation, allowing grapes to reach phenolic ripeness. Martin notes it “enabled some to capture the brightness and freshness of vibrant red fruit where Pinot Noir reaches its apex” and lent Chardonnays “razor-sharp tension and delineation.” Whites show energy and mineral clarity, while reds are delicate, transparent, and expressive rather than powerful.  Despite the challenges, skill and perseverance triumphed. Careful vineyard management and thoughtful vinification produced wines of elegance, freshness, and charm. As Martin concludes, “The bottom line is that 2024 is an endlessly fascinating vintage that will enamour the small number who imbibe the fruits of much labour.”  Explore Neal Martin’s reports, notes and scores on the Vinous site (subscribers only)  Burghound – Allen Meadows  Allen Meadows’ Burghound report describes 2024 in the Côte de Nuits as a vintage of extreme difficulty and delicate character. Following “rain, rain, and yet more rain,” growers faced poor flowering, rampant mildew, and historically tiny yields, with clusters sometimes reduced to 15–20 berries. Meadows notes that “the variability in 2024 is that of 2023 squared,” making disease control, rigorous sorting, and careful vinification essential to preserving quality.  Despite the challenges, the best wines are “ultra-fresh, wonderfully energetic, impeccably well-balanced and the most transparent reds we’ve seen since 2010.” Alcohol levels are modest, around 12.5–13%, enhancing clarity and finesse rather than weight or power. Harvest ran from 16–21 September, slightly later than the traditional 100-day rule, allowing vines to achieve ripeness amid persistent rainfall.  Vinification emphasized restraint: light extraction, reduced stem use, and careful temperature control preserved purity and avoided harsh tannins. Minor faults, mostly reduction from copper or sulfur sprays or slight volatile acidity, rarely detract. Meadows notes some wines are “too skinny or too lean,” but the best display crystalline transparency that “puts the intrinsic terroir on parade.”  Most wines suit mid-term cellaring: villages and premiers crus are approachable in 4–8 years, while top grands crus can age 10–15. Stylistically, 2024 reds are elegant and energetic, rewarding careful selection in a year of extreme variability.  Explore Allen Meadows’ reports, notes and scores on the Burghound site (subscribers only) Jancis Robinson – Jancis Robinson Jancis Robinson MW sums up 2024 as “nightmare… misery… exhausting… unremittingly grim,” with “gruesome” final yields. Heavy rain and unusually low temperatures during flowering severely damaged Pinot Noir, particularly in the Côte d’Or, while Chardonnay fared slightly better. Many vignerons abandoned organic viticulture for systemic sprays to save their crops. Pierre-Yves Colin-Morey achieved “respectable, but most unusual for 2024” yields of 35–40 hl/ha only by switching early.  Losses were severe: reds down up to 80%, whites about 30%. Robinson notes that “the cool summer meant acidities were high, and successful reds could be described as pretty, but never concentrated,” with pale color and barely perceptible tannins. Late August brought some warmth, raising sugar levels, though many producers still had to chaptalise. She warns this is “a vintage to drink relatively early,” emphasizing elegance over opulence, fragility over power.  Cellar work was complicated by tiny harvests. Half-full tanks increased the risk of oxidation or stuck fermentations. Oak use was moderated, though some grands crus required up to 50% new barrels to fill them. Extraction and whole-bunch fermentation were carefully managed, with co-fermentation across parcels common.  Despite the challenges, Robinson highlights successful producers including Bertrand Bachelet, Yvon Clerget, Comte Armand, Philippe Colin, Sérafin, and Joseph Drouhin. Regions south of the Côte d’Or fared better, producing more generous, sophisticated wines. She frames 2024 as “a triumph of resilience over nature,” rewarding careful selection and precision in the cellar.  Explore Jancis Robinson's reports, notes and scores on her site (subscribers only) Jancis Robinson – Matthew Hayes  Matthew Hayes describes 2024 as a vintage “all over the shop,” marked by extreme scarcity, mildew pressure, and uneven quality across the Côte d’Or. Some estates, like the newly launched Domaine Henri Rebourseau, produced nothing, while others managed only tiny parcels. Yet Hayes notes, “producers actually had some wine; the second relief was that these had turned out better than feared.” Quality varies by village, vineyard, and even row, making careful selection essential.  The season was relentlessly difficult. Pinot Noir struggled with coulure, millerandage, and mildew, while Chardonnay fared slightly better thanks to earlier flowering. Organic producers faced doubled labor and costs, with some switching to synthetic sprays to save their harvests. Final yields were punishingly low, with red grape losses up to 85%. Harvest began in mid-September, balancing ripeness with botrytis and powdery mildew risks.  Winemaking focused on tiny lots, cautious extraction, and moderate oak. Reds are elegant, medium-bodied, and dominated by red fruit, while whites show precise acidity and finesse. Hayes notes, “This is not the Pinot Noir we have recently come to expect.”  Scarcity keeps prices high, yet the best wines are balanced and surprisingly drinkable. As Hayes concludes, “The bottom line is that 2024 is an endlessly fascinating vintage that will enamour the small number who imbibe the fruits of much labour.”  Explore Matthew Haye’s reports, notes and scores on the Jancis Robinson site (subscribers only) Decanter – Charles Curtis MW Pommard & Volnay 2024: Early-drinking Pinot Noir   Charles Curtis MW highlights Pommard and Volnay as the standouts in 2024, a vintage where Pinot Noir struggled across Burgundy. The northern Côte de Beaune largely avoided the worst rain and mildew, producing wines with the lush, supple fruit the region is known for. Pommard ranges from firm and tannic to approachable, while Volnay shows silky, expressive character.  Yields were exceptionally low: Paul Zinetti of Comte Armand recorded just 15 hl/ha, and Paul Négrerie of Château de Pommard 14 hl/ha. Careful extraction was key to avoid green tannins, producing wines of elegance over ripeness. Frédéric Lafarge notes that Volnay’s 2024 shows purity and terroir expression, comparing it favorably to 2021: “2024 showed more finesse and complexity due to the longer vegetative cycle.” Overall, the vintage is lighter than usual, suited to earlier drinking, though the best wines from top producers can age five to ten years.  Best Value Burgundy 2024 Wines   Finding value in 2024 requires a selective approach, as low prices rarely coincide with scarce wines. Curtis recommends starting with regional appellations, particularly the Hautes-Côtes of Nuits and Beaune, where top performers include Bourgogne Hautes-Côtes de Nuits Les Dames Huguette (Dufouleur) and Bourgogne Hautes-Côtes de Beaune blanc (Guiton).  Further south, the Côte Chalonnaise offers excellent options, with Maison Chanzy (Bouzeron), Domaine Belleville (Rully), Château de Chamirey (Mercurey), and Domaine du Cellier aux Moines and Domaine Stéphane Aladame (Givry/Montagny) standing out. Curtis also praises the Mâconnais for Chardonnay, noting “bright acidity, fresh fruit, and solid structure,” with Pouilly-Fuissé in particular shining.  In short, 2024 may be small in volume, but careful exploration of Pommard, Volnay, the Hautes-Côtes, southern Burgundy, and the Mâconnais reveals wines that combine quality, typicity, and attractive drinking windows.  Kristaps Karklins portrays 2024 in Chablis as a season of extreme attrition, marked by frost, hail and what he calls “historic mildew pressure—among the highest ever recorded.” Yields dropped by “60% to 70% on average,” with some estates losing entire crus, including Dauvissat’s Séchet, Montée de Tonnerre and Les Clos. By late August, rainfall had reached “around 600 millimeters, compared with the average 380,” making healthy fruit scarce and rigorous sorting decisive. Growers who waited to harvest were rewarded with “greater texture and mid-palate amplitude,” while early picking risked under-ripeness and dilution.  Despite the hardships, barrel tastings reveal notable successes. The finest 2024s are “classical Chablis,” defined by tension, clarity and site transparency, and approachable earlier than most vintages. While they cannot rival the concentration of 2023 or 2022, Karklins suggests they may delight purists more than a random selection of riper years. “No one would call 2024 a historic vintage,” he concludes, yet among the best producers the wines are “unmistakably, even nostalgically Chablisien,” rewarding careful selection with freshness, character and authenticity.  Explore Kristaps Karklins reports on the Wine Advocate site (subscribers only) Wine Advocate – William Kelley In a shorter spotlight on Verget and Domaine Guffens-Heynen, William Kelley describes 2024 as wetter and more overcast season following the warmth of 2022 and 2023, though mercifully spared the frost damage that scarred 2021 and 2016. Volumes are reduced, but quality is “solid,” and some wines “transcend the vintage,” reaching levels of maturity that are unusual for such a challenging year. Jean-Marie Guffens likens the domaine’s 2024s to 1998, a vintage that performed better in the Mâconnais than in the Côte de Beaune.  The true stars for Domaine Guffens-Heynen, however, are the bottled 2023s. Kelley ranks 2023 alongside 2020 as one of the finest vintages for domaine in the last 10 to 15 years—and among the best of Guffens’s career. If the 2020s are “almost neoclassical” in style, the 2023s are more flamboyant, setting up a compelling contrast between two outstanding expressions of the domaine that will invite comparison for decades to come. Burgundy 2024: the critics’ verdict

“It’s been an absolute pig of a year,” says Mark Gaskain. It’s September 2024 and we’re reaching the end of what has been a trying growing season across most of Europe – with seemingly never-ending rain. Fortunately, Gaskain knows that such challenges are just part of the job. He’s a farmer, born and bred, now at the helm of his family business, and responsible for growing 70 million apples a year. But in the last decade, he’s added a new strand to the business – after selling a swathe of land to none other than Champagne Taittinger in 2015. That land is now the home of Domaine Evremond – one of the most exciting English wine projects to date.  The story began almost a decade ago. Patrick McGrath – founder and CEO of Hatch Mansfield, which represents Champagne Taittinger in the UK – had been looking at adding an English sparkling wine to the company’s portfolio. It was the early 2010s, and he spied an opportunity with the burgeoning category – but Pierre-Emmanuel Taittinger suggested that, rather than taking on an existing estate, McGrath should create his own, working with Taittinger. Taittinger had embarked on a similar venture in California, creating Domaine Carneros with their US agent, Kobrand, under Pierre-Emmanuel’s uncle, Claude. Together, they decided to take the plunge.  They charged leading English wine specialist Stephen Skelton with helping them find the perfect site – determined to have chalk soils, south/southwest-facing slopes (for maximum sun exposure) at altitudes below 100 metres (with temperatures reducing by 1°C per 100m, anything above this would simply be too cold in England’s marginal climate). Kent – with easy access across to Champagne – was decided on, but it took them 18 months to find the right site. At the same time, the Gaskains were looking at selling some of their land (a foray into soft fruit had proven challenging, and were looking to get back to their core business of apples). The timing was fortuitous and the orchards at Stone Stile Farm – around the village of Chilham, southwest of Canterbury – were perfect. As Alexandre Ponnavoy (Chef de Cave for both Taittinger and Evremond) told me, if a site can grow good fruit – it’s a good indicator for its viticultural potential.  In 2015, the deal was signed and the project launched with great fanfare at Westminster Abbey. Domaine Evremond takes its name from Charles de Saint-Evremond (1614-1703), a Frenchman, essayist and early ambassador for the wines of Champagne – bringing them to the court of Charles II – who is buried in Poets’ Corner. Although Didier Pierson – a grower in Champagne – had made English wine under the Meon Hill label, Taittinger was one of the first major Champagne Houses to invest in England (Pommery had bought vineyards in Hampshire in 2014). Unsurprisingly, press coverage was extensive: the Champenois were coming to make sparkling wine on our home turf – the French naysayers set to eat their hats as the world started facing up to fine English fizz.  Evremond’s first vines went in the ground in 2017, with more added in 2020 (the team set up at the local Premier Inn to tackle the work mid-pandemic) and in 2024. The land here has a layer of alluvial clay over its chalk subsoil which is part of the Paris basin, shared with much of northern France (including Champagne). Around Canterbury, however, there’s more flint in the soil – something that Ponnavoy feels shines through in the wine, giving it a mineral, reductive character. There’s also a definite maritime influence – moderating temperatures, but also bringing ocean breezes from Whitstable, which is just six miles away. For Ponnavoy, it’s the combination of the site’s chalky soils, maritime softness and sea winds – a “contrasting climatology” – that defines the Evremond wines.   Gaskain is deeply involved in the project – his in-depth knowledge of the land an invaluable resource, knowing where potential frost pockets lie, for example, or where the soil might be overly rich for vines. He and his team manage the site day-to-day, guided by Christelle Rinvelle (Taittinger’s Vineyard Director). Currently, they have 62 hectares of vines, split between 45% Chardonnay, 45% Pinot Noir and 10% Meunier. They planted Chardonnay on areas with the thinnest topsoil, allowing its roots almost direct access to the chalky bedrock, while the Pinot Noir and Meunier sit on the more clay/gravel-rich plots.  The vines are widely spaced (5,000 vines per hectare – half the vine density Taittinger uses in Champagne) and trained higher than across the Channel, allowing for better airflow (helping manage disease pressure) and a larger canopy (to aid ripening). While herbicides have never been used on the site and there’s a concerted effort to be sustainable, Gaskain is clear on the limitations of viticulture in Kent: “Organics is madness in this climate,” he tells me – as, perhaps, 2024 proved. While the team has vine-specific sprayers, Gaskain can also draw on his team’s orchard equipment too – a boon when conditions are challenging – and spray the entire site in one (rather long) day.  They harvested tiny quantities of fruit in 2018 and 2019, with the first commercial-sized vintage coming from 2020 (conveniently the grape harvest falls neatly between that of Galas and Braeburns). Early wines were made at nearby Simpsons, and from 2020, they set up in an old concrete barn on the site – with the entire operation run on a generator. In June 2022, they broke ground on a new winery (“We were over budget four weeks after starting,” says McGrath, with a weary smile). The same company that worked on the Channel Tunnel dug out 83,000 tons of chalk (around 2,000 lorry loads) to make way for the three-storey building that stretches 20 metres below ground. Designed by Reims-based architect Giovanni Pace, the idea is for the winery to blend into the landscape – rather than stand on it. It has the capacity to cellar 1.5 million bottles – all without expending any additional energy on cooling, thanks to its natural subterranean chill.   Works were finished in time for the 2024 harvest – a relief undoubtedly for the team. There is something charmingly British, slightly ramshackle and underdog about the operation – despite the very serious money behind it (£17 million invested so far, reportedly). “Everybody’s had to muck in,” says McGrath. He might be Hatch’s CEO and one of the Evremond founders, but he’s also the first to pull on his wellies to help with harvest – and has spent more weekends in the vineyard than anyone else. Vitalie Taittinger has taken over from her father as President of Taittinger, and McGrath’s daughter India is running the commercial side of Evremond – meaning the operation really is a family business, even if it comes with some luxury, Champenois-esque swagger.  With the Taittinger association, of course, expectations are incredibly high – something McGrath is painfully aware of. Talking to Ponnavoy – who is in charge of the winemaking at both Taittinger and Evremond – there’s been something very exciting about creating a project from scratch, even if it has come with some challenges too. He argued to keep the small 2018 harvest for the property only, allowing them to follow the wines in tank over several years, and get to know the site. It was a huge cost, and delayed the first release, but something he felt was crucial.  “It was really important not to do a copy of another sparkling wine, not to produce a… ‘style’,” he says. Their goal, instead, was: “To identify the terroir, to identify the soil, to identify the climate, and reproduce all that in the bottle. To find the Evremond identity.” Inevitably, there’s a temptation to draw comparisons between Taittinger and Evremond, but the team is clear that they are totally separate projects with very different DNA.  Working with English fruit, Ponnavoy felt it was key to manage the potentially biting acidity (and the wine sees full malolactic as a result), but – for him – the greatest challenge was to avoid a bitterness that he finds common in some English wines. Managing the phenolics to avoid this was, for him, therefore essential, while he also focused particularly on the bubble texture – working to get a very fine mousse, something that he believes sets the wine apart from the competition.  In time, Evremond hopes to make 400,000 bottles a year, although there are only 120,000 of its first release. There are plans to add a vintage and rosé cuvée once the vines have matured and they’ve gotten to know the site, but for now they’re only producing the non-vintage Classic Cuvée. Now, a decade after they bought the land, Edition 1 of the Classic Cuvée is set to be released. For a début, it’s an incredible result – perhaps not surprising given the pedigree of the operation. Unlike many wine-lovers, I came across Occidental before Kistler. I worked for a company that imported some of its early vintages – and they were like nothing I’d ever tasted. These translucent Pinot Noirs glimmered, but their pastel-pale shade was nothing but a nudge and wink at the Burgundies that inspired them. Aromatics leapt from the glass – floral and febrile, but it was the vivid, intense, crystalline purity of the palate that I found so beguiling. Seeing where these wines are made – on the brink of the Pacific, where ocean breezes lash at the vines, and thick fog grasps the dramatic, undulating landscape – only made them all the more enchanting. Even today, 18 years after Steve Kistler first put down vines here, the region is sparsely planted – with Occidental one of a handful of pioneers of the outer reaches of the Sonoma Coast. The area was long deemed too cold to ripen fruit, with dairy the main industry – and fields of grazing cattle and sheep are still interspersed with plots of vines. Occidental’s vineyards – now 85 acres in total – now neighbour those of Platt, Littorai and Joseph Phelps’s Quarter Moon site, sitting at 500 feet above sea level – a modest altitude when you consider some of Napa’s mountain districts have parcels above 2,000 feet. But it’s their proximity to the ocean (which is just five miles away) that makes the climate here so cool – and damp. Leaf-pulling and spraying are key to managing disease pressure – unfortunately making organic farming almost impossible. “We want the purity of fruit to shine,” Catherine (Cate) Kistler says. She joined her father, Steve, six years ago, working as his Assistant Winemaker – just one element that makes the venture a true family business. Not in the way that Walmart or Ford are a family business, but in the hand-to-mouth, everyone-mucks-in, this-is-both-their-livelihood-and-legacy kind of way. It’s a “tight little universe” where they work, live and farm, Cate explains. This is one reason that Steve stepped away from the iconic winery that he’d created in 1978 – Kistler had shifted and grown, becoming something larger than he’d ever anticipated, or necessarily wanted.  Kistler had humble beginnings – with Steve making the wines in what was essentially a wooden shack, and living upstairs. That building – up in the Mayacamas – was consumed by the fires in 2020, and today Kistler works with around 300 acres (including their own vines and those farmed by growers for them). The investment of Bill Price (a man whose first major move in the wine industry was buying, and later selling, Beringer) has added further gloss to a winery that has become one of California’s cult names. If that makes it sound like there’s been wholesale change, that’s far from the truth – a clear succession plan has ensured only the gentlest of evolutions at Kistler, and ensured the producer maintains its position at the top. Jason Kesner – who describes himself as a “vine and yeast shepherd” – is the man at the helm today. He joined the team in 2008 (aged 40), working alongside Steve for close to a decade before taking the reins.  Although born on the East Coast, Kesner grew up around wine. He moved out to California aged eight, where his mother had taken a job as Head Microbiologist at Robert Mondavi, and his soon-to-be stepfather worked as VP of Vineyard Operations – the smells and sounds of a working winery firmly familiar. Despite his early initiation to the industry, he studied cultural anthropology and left both the area and industry. He was eventually lured back, working first for Francis Ford Coppola (the man behind Inglenook’s revival), but in a non-wine role – managing his special projects. Via Coppola’s poker games, Kesner connected with Pat Kuleto and ended up planting vineyards for him, before finding himself at Hudson (his “graduate school for Chardonnay production”). This prestigious name features on bottles from the likes of Aubert, Kongsgaard, Cakebread, Failla and Ramey – and Kesner got to work with all of them, growing top-tier fruit for 34 clients, including Steve Kistler. And Steve was different. He was, Kesner says, “very, very focused”, “hyper-intelligent, borderline genius” and – along with his business partner, the late Mark Bixler – thought about things on a different level. When the duo started Kistler in the 1970s, working with a single clone and single sites, no one else was doing it – with his unparalleled energy and intent, Steve created something profound. Although Kesner had already worked closely with Steve at Hudson, it was only when he arrived at Kistler in 2008 that he realised how differently Steve operated. “I had jumped into a different timeline and a different pace,” Kesner tells me. “Steve and I had conversations that, quite literally, spanned years.” These conversations would be picked up each vintage, just a handful of sentences on a topic expressed until the next season. For Kesner, this long-term vision was what set Kistler apart: “It’s not about the people who are doing it at the moment. It’s about everything that’s come before and it’s about everything that will come after.” The Kistler evolution has been slow, but it has happened – past their phase of “embracing the cocaine ’90s” (“If you weren’t, you weren’t paying attention,” Kesner says), with a shift toward earlier picking, native ferments and reduction in new oak (from 50% down to around 38% across the range today) – but without sacrificing the seductive, silken style that defines their Chardonnay. “Our job is to polish the jewel,” Kesner says. “The diamond doesn’t need to be re-cut.” The vines are also gradually gaining in age (currently averaging a spritely 35 years), which is only improving the wines further. Kesner is continuing Steve’s work and the philosophy remains true to the original concept. “The best and highest use of a given site is when you're guiding it, not driving it,” he says, pointing to Mother Nature (rather than Bill Price) as the ultimate boss. He loathes the title “winemaker” – fully aware that it’s an entire team behind Kistler. “There are 56 people who are dedicated to the production of these wines. They’re out there pruning in January and then they’re going to be out there picking for this year in October. And it’s because of that really powerful group of people that we’re able to do what we do.” Meanwhile, out on the coast, Steve is continuing his own quest for terroir. Occidental, Cate tells me, is all about exploring “what this ridge means”. The yields at Occidental, overlooking the Pacific, are tiny, maxing out at around two tons/acre. The work is painstaking, with careful canopy management and spraying to avoid mildews, and steep slopes that need to be hand-hoed to manage the weeds. And, as at Kistler, the Pinot Noirs here are all made identically – so it is the site, rather than hand of the maker, that shines through. Be that though it may, it takes exceptional talent to make wines like this. “[Steve] is yet again 30 years ahead of everybody in California,” Kesner says. “It might take the American palate a while to catch up with them, but I firmly believe those will be recognised as some of the best Pinot Noirs in the world. Hands down.” Steve’s an elusive character – and seems happiest tucked away in his remote corner of the Sonoma Coast, away from the limelight. “He’s not a man of many words,” Kesner says, although suggests that working with Cate has drawn him out of his shell a little. Cate talks about him unsurprisingly lovingly, but doesn’t shy away from admitting there are challenges to the “weird and wonderful world” of family business. Harvard-educated, she’s quick-witted and sharp, and has clearly inherited her father’s passion for wine. Not only is he clearly deeply embedded in everything Occidental, but his interest goes beyond vine-growing, with what I suspect is an enviable collection of his own, from the alluring line-ups of Grand Cru Burgundy that I’ve glimpsed on Cate’s Instagram. It takes something rather extraordinary to be willing to give up your name, to start from scratch, all over again, with a new winery and new vineyards. But there’s a reason that his longtime vineyard manager (Ruben Molinar) and cellar master (Raymundo Abarca) left Kistler with Steve in 2017; and it’s a tribute to the man. Now Molinar and Abarca’s children are working alongside Steve’s – and the family is growing. But Cate and Steve don’t want to create Kistler 2.0. They’re developing another ranch, but they don’t want the project to become so big that they’re no longer doing most of the work themselves (“We’ve seen that movie,” Cate jests). The first vintage of Occidental was only 2011, but the wines are already making their mark. Steve’s legacy at Kistler lives on, safely being shepherded by Kesner and his team, but it’s also being re-born at Occidental, and set to be carried forward by Cate. “Wine is my dad’s world,” Cate tells me. Jaime Araujo’s surname is a familiar one to Napa collectors. Her parents Daphne and Bart purchased the famed Eisele Vineyard in Calistoga in 1990 and established their eponymous winery on the site shortly after. Jaime was enrolled in university at the time and wouldn’t join her parents in Napa for many years, instead spending over two decades studying and working in Europe, including a stint at Moët Hennessey. She arrived in Napa in 2012 to work alongside her parents as a business consultant, but the job was short-lived, when the winery and Eisele Vineyard was sold to Artémis Domaines (the parent company of Ch. Latour) in 2013.   While her parents went on to establish Accendo Cellars, with Jaime and her brother as partners, the itch to build a business of her own only grew stronger. “I always wanted to run a business as a force for good,” she recalls. She got her chance during the first vintage at Accendo in 2013, when she turned a Cabernet Sauvignon lot that didn’t quite fit in with any of the Accendo cuveés into her first 300 cases of Trois Noix wine. (The name – French for “three nuts” – is a cheeky reference to her two children, as well as her brother’s daughter, all quite young at the time.)   Despite her family’s legacy, and perhaps the temptation to enter the market at the top end, as many newcomers do, Jaime was intent to create wines that were approachable and embodied sustainability ideals. This included a pricing strategy that skewed heavily towards affordable options, ranging from $30-50 per bottle and the most expensive Cabernet Sauvignon topping out at $150. “I’m not in this to make billions,” she laughs. “It’s so important that Napa is accessible to as many people as possible. You have to be welcoming and make wines that appeal to everyone.”    Even before Jaime was developing her brand, Steve Matthiasson had been quietly establishing a reputation as one of Napa’s most respected organic winegrowing experts. After studying horticulture as a graduate student at the University of California Davis, he launched his wine career in 1995 as a viticultural consultant, going on to settle in Napa with his wife Jill Klein Matthiasson in 2002 and building an impressive client roster. Since 2007, Steve has worked closely with the Araujo family, first for Eisele vineyard – where he continues to consult – as well as at Accendo. Other current and past clients include Dalla Valle, Spottswoode and Chappellet.   The process of becoming a winemaker in addition to viticulturalist, however, has been a slow and steady process. Matthiasson says he learned about wine almost by osmosis over the years, sitting in on client tastings and by keen observation. In 2003, Steve and Jill produced just 120 cases under their name, but by 2017, they reached a major milestone with the purchase of a small winemaking facility and neighbouring vineyard in the Oak Knoll AVA – a massive accomplishment for two outsiders with little initial capital. Last year, their production reached 12,000 cases, stretched across 25 unique cuveés. Today, Steve farms most of the vineyards he makes wine from, including a small vineyard at his home, where he has planted rows of northern Italian varieties, including Refosco, Ribolla Gialla and Schioppettino.   Inside the compact Matthiasson winery, cosy by Napa standards, foudres line the walls and nearly every inch is occupied with equipment, case goods and barrels. In the corner, a stack of large glass jars filled with liquids of varying colours sits – the aromatics steeping in alcohol for vermouth, Steve explains, which he and his wife make along with olive oil and jam, as accompaniments to the unique lineup of wines Matthiasson produces, ranging from single-vineyard Cabernets to more esoteric fruit and wine co-ferments. While many collectors still may not have heard of Matthiasson, Steve says he is proud to be sought after by sommeliers and others in the wine trade: “We like to say we’re the musicians’ musician.”   Both Jaime and Steve believe strongly that their businesses must be both environmentally and socially responsible. “It’s so important to stand up for what you believe in,” Jaime emphasises. Today, Trois Noix boasts a range of sustainability initiatives, including B Corp status, a high-level sustainability certification which only two other wineries in Napa currently possess. Though not specific to wine or agriculture, B Corp certification is awarded after a rigorous assessment to prove a dedication to positive community impact alongside profit.   In the same vein, all of the vineyards Steve farms for Matthiasson are organic, which is the certification that is the most meaningful to him – and represents a full circle of sorts from his early days studying agriculture, when winemaking was not yet on the horizon. “Organic farming has become not just accepted but embraced since I’ve been here,” Steve says, saying that it’s becoming the norm rather than the exception, especially so for the most well-known cult Napa wineries. “And it’s not just for PR,” he adds, saying many don’t broadcast their farming practices. “They truly believe it makes better wine.” Steve believes the standard of farming has improved dramatically since he arrived in Napa and so has the quality of the resulting fruit. “As the years have gone by, our ability to do the right thing has increased,” he says.  The resulting wines that both Trois Noix and Matthiasson produce are crafted in a fresh style, with an emphasis on primary fruit and terroir-specific cuvées, as opposed to dominant oak or heavy extraction that have been the trend for fine wine in Napa. Araujo says she is trying to craft wines that are reminiscent of Napa 50 years ago, by using a light hand. “We started getting bigger and bolder in Napa, and that’s fine, but we can do this, too, and do it well.” Araujo describes her goal each vintage as crafting wines in a “sweet spot”, built to enjoy immediately but also with the structure and acidity to age for several years at a minimum.    At Matthiasson, pick dates are watched closely, and occur on the early side for Napa, so that alcohols remain low and acidity is naturally brisk. Other than a small amount of sulphur, no other additions are made. “We utilise traditional winemaking methods,” Steve says – quick to note, though, with a laugh, that there is a difference between “natural and natty”, explaining that his goal is to make fresh, clean wines from the healthiest fruit possible. Unlike other Napa wineries that employ optical sorters and tables lined with harvest workers examining every berry, Mathiasson does not sort the fruit prior to fermentation, trusting instead in the farming and meticulous picking over multiple passes.   “We’ve always been an agricultural community, and no one wanted to talk about that for a long time,” Jaime tells me. She believes the future of Napa will be a focus on not just high quality but also history, community and a reputation for doing the right thing. These will not be talking points for her brand only, however, as last year she was elected Board Chair of the Napa Valley Vintners. A nonprofit trade association founded in 1944, NVV acts as a voice for the wine business in Napa Valley, promoting, supporting and advocating for its over 500 members. “I’m a bridge between old and new because of my family and my experience,” Jaime says, explaining that she hopes to bring a fresh perspective on the future of Napa, one that emphasises a range of styles and price points, but most of all, is able to welcome a wider range of people than ever before, by showing the varied people and places of the region. Matthiasson voices a similar ethos. “The wine business has so much artifice, but we want to let people in.”  Matthiasson and Trois Noix collaborated on a special lot for Premiere Napa Valley last year – a lot that we purchased and will soon be releasing. Rum has been positioned as the next big thing. The one to watch. The spirits category to steal market share from Scotch whisky and the sure-bet to clean up when that gin bubble finally bursts. These claims have been made for the past five years, if not longer. When you look at the figures, which don’t tell the whole story but are a good starting point, rum has been in rude health since 2018 when sales in the UK surpassed the £1 billion mark for the first time. This same year, a rum was named the best spirit at one of the most prestigious blind tasting competitions for the first time. Rum, for many, had finally arrived. “What has changed in the industry is what we can bring to market,” Master Distiller Richard Seale says, in a typically matter-of-fact and non-marketeer way. “So, it is not so much that we are changed in our rum making but today we can think to invest in very old rums, we can think to release cask strength rums, we can offer more specialised rums like pot still or pure cane juice rums and we can think about non-traditional markets – like the Far East. Twenty years ago the market for any of this was extremely limited.” Seale’s family-owned Foursquare Distillery in Barbados was the winner of the aforementioned 2018 blind tasting and the awards have continued to rain down on them since. While always destined to join the family business, Seale says that didn’t necessarily mean a career in rum, other than to sell. “What happened was the year I officially joined, my father made the biggest acquisition we had ever made in acquiring the Martin Doorly and Alleyne Arthur brands. This made for two big changes: one, we would have to invest in aged stocks as these were premium brands and two, we would start exporting. This naturally drew my focus.” Rum has been produced in the Caribbean for centuries. Historically, the new-make was sold to brokers and blenders in much the same way as Scotch whisky. Whereas Scotch distilleries started to bottle single malts from the 1970s, most rum producers wouldn’t have the epiphany to move away from a purely bulk model for another 20 years. It was from this time that rum brands as we know them began to appear in the European market. El Dorado from Guyana, for example, had been produced for centuries before it was marketed for the first time in the early 1990s. Similarly, Hampden Estate, which had been producing rum since 1753, only came to market in 2018. Legendary Trinidadian rum Caroni never actually saw the light of day as a brand in the traditional sense before it closed for good in 2003. “The rum category has changed out of all recognition,” Ken Grier, Creative Director at Colombian brand Dictador, says. “It has progressed from a white and dark mixable spirit to a premium spirit aged in good quality oak casks.” The reason for this progress is down to a multitude of factors – one of which is the realisation that rum has tremendous breadth and depth. “People have realised the rum world has a beautiful range of quality liquid to offer at the top end (rather than just the stock-standard ‘every bar has a bottle of this’ at the low end) and it has encouraged the rum-curious to be more adventurous,” Mitch Wilson, Black Tot Global Brand Ambassador, says. “We’re even starting to lead astray some of our more open-minded whisky brethren who are used to having to pay several times the price for a bottle of their favourite malts,” he adds. Wilson says better access to rums and rum makers have also contributed to this seed change. During the pandemic, the world in many ways got smaller and rum makers who had previously shied away from using technology were forced to embrace it (wifi permitting) to ensure their survival. He says thousands of people came together to discuss sugarcane spirits and meaningful connections were established between rum producers in the Caribbean and their ever-growing appreciators. Physical access to rums has also changed in recent years. Historically, French markets would predominantly sell rhum Agricole (made from sugarcane juice) from the likes of Martinique and Guadeloupe, and English speaking countries would typically sell rums from Barbados and other Caribbean islands, limiting the discovery of rums. As this has shifted, so too has the understanding and appreciation of rum. Similarly, social media has narrowed the gulf and empowered distilleries and rum enthusiasts to disseminate accurate information on rum and campaign against perceived wrongdoings. “In any spirits category there are many different levels of quality available,” Wilson explains. “I firmly believe that anyone who loves spirits but doesn’t love rum yet, just hasn’t tried the right rum for them. Perhaps their perceptions are skewed by some cheap bottle of rum they had when they were younger, or the fact that the average pub or supermarket might not offer a particularly premium selection (especially when considered next to the other spirits offerings).” Now things are changing, Wilson believes everybody has the chance to explore the very best of each spirits category and not just the “commercial rank and file” if they are willing to spend a little more on quality liquid. And rum is no different. “There are some exceptional rums that are of comparable quality to their favourite spirits,” he adds. In the same way whisky has its hard-core enthusiasts who are authorities on the subject in their own right, certain rums have developed a cult following which has driven up the cost of bottlings of certain styles from certain distilleries. High ester rums, for example, are a source of great fervour among rum fans. Jamaica is arguably the godfather of this style, with Réunion Island and a few other French territories also famed for this funky rum that in many cases wasn’t produced for consumption. Part of its appeal, according to Daniele Bondi from La Maison & Velier, is that high esters satiate in a way that whisky currently does not – on the matter of fermentation. “Historically, whisky has never spoken about raw materials or about the fermentation,” Bondi says. “Whisky normally speaks about the ageing, the master blender, and the magic. Here it is more a matter of raw materials so it is another point of view.” This point of difference and palate-altering taste is gaining in popularity. Bondi and others are quick to caution that it might be unwise to follow high ester count alone, in the same way whisky fans have pursued age statements. “It’s important not to chase the highest level of ester regardless the quality,” he says. “Esters are classified by quantity, and we know that connoisseurs love numbers on label, like for the ageing, where the worst mistake is the highest number equals the best. Also in ester amount this is a mistake: what is important is the balance of the product.” Another comparison that can be drawn with the whisky world and collectability is mothballed and closed distilleries. There have been several significant closures in the rum world – Caroni arguably being the most devastating to rum enthusiasts almost 20 years ago. Blends from closed distilleries, proprietary bottlings from a single distillery, and rums that have been produced via methods that have long since been lost have all become collectors’ items and driven scarcity in the category. While there is a market for these collectors’ items, Wilson feels true excitement towards rums that are currently flying under the radar. “You can get tremendous rums for incredible value and have something really enjoyable to explore,” he adds. “This may not always be the case though – we are already starting to see incredible demand for rums like Foursquare, Velier, and Caroni bottlings, all of which command multiple times their retail price at auction mere days after they are launched and sold out. “Even with the demand for rum going up, it is still incredible value when compared to liquid of a similar quality from the whisky categories.” For many reasons, we’re in the eye of a perfect storm for rum. Its high quality credentials, point of difference, and the tireless campaigning of certain individuals to put an end to the nefarious practices of some, ensure that rum is finally having its time in the sunshine. “If ever there was a time to build your rum collection, it was 10 years ago,” Wilson says. “The next best time is right now.” Explore rum or read more Editorial

2021 Bourgogne Hautes-Côtes de Nuits, Louis Auguste, Domaine David Duband  
This wine, named in honour of David’s son, Louis Auguste, comes from higher-altitude sites and some of the domaine’s oldest vines (over 55 years in age). In 2021, it’s spicy and lifted – offering a mouthful of pure, crunchy red fruit. It’s fresh and mouth-watering, building to a savoury, smoky finish. Superb value.  


2021 Gevrey-Chambertin, Charles van Canneyt  
This village bottling is an excellent entry point to Charles van Canneyt’s range – especially if you can’t get your hands on any of his Domaine Hudelot-Noëllat wines. The 2021s may be the best vintage to date of his négociant label, with a line-up of elegant and vibrant wines that offer great value. The village Gevrey-Chambertin is a wine of such finesse – with a lifted, perfumed nose. But behind the aromatics, there’s a more serious palate, with persistent, focused fruit, and vivid acidity driving through the core of the wine. The long finish is scented with delicate florals. 


2021 Gevrey-Chambertin, Domaine Duroché  
Because yields were so low in 2021 (due to frost and hail in the north of Gevrey), Duroché’s 2021 village Gevrey includes fruit from Le Clos, Champ, En Vosne and what little survived the hail in Premier Cru Champeaux. All Duroché’s vines are old, and for this cuvée, they were all planted between 1930 and 1986. The nose is perfumed and floral, but it’s the palate that really sings – with a tight energy and ripe, round mouth-feel. A gentle toastiness (with 15% new oak) coats the sweet, red cherry fruit. This vibrates with potential – the finish long, saline and mouth-watering. A brilliant introduction to the Duroché style. 


2021 Savigny-lès-Beaune, Premier Cru, Aux Guettes, Domaine Jean-Marc & Hugues Pavelot  
This vineyard sits just below the forest, with only 30cm top-soil over the hard rock below. The Pavelot plot (a mere 0.35 hectares) shows a totally different side to Savigny – brighter and lighter, with vibrant red fruit and a creaminess (with 25% new oak). The nose is full of raspberry and cranberry, with a welcome, sublime freshness thanks to this more “traditional” vintage. The medium-bodied palate is mineral and elegant, with great tension. The oak is well-integrated, bringing extra weight to the mid-palate, building to a vibrant, long finish. This is a top wine – classic and airy, as Burgundy used to always be. 


2021 Givry, Premier Cru, Clos Marole, Domaine Joblot  
Clos Marole is one of the few survivors from a catastrophic growing season at Domaine Joblot, with yields slashed by 50%. But – even if there’s not very much of it – the wine is superb. You’re instantly struck with vibrant, fresh red fruit, blackberry and crushed strawberry – possibly thanks to the old vines (on average 40 years old). The oak (35% new) needs a little more time to integrate fully, but is well-judged. Relatively light-bodied, the palate is driven by great acidity and silky tannins. The finish is long and suave. Enjoy this delicious wine young, but it has everything to keep for a decade or more.  


2021 Morey-Saint-Denis, Premier Cru, Clos des Ormes, Domaine George Lignier  
Domaine Georges Lignier is the largest owner in Clos des Ormes, with almost two hectares of the Premier Cru, all on calcaire comblanchien. The nose is pretty and perfumed with sweet spice notes courtesy of the oak (around 25% new). The fruit is bright and crunchy, yet there’s a darker, more brooding aspect on show – with a powdery tannic structure adding texture to the pure, long palate. An impressive result in the vintage.  


2021 Coteaux Bourguignons, L’Eclos des Abeilles, Domaine de Bellene  
Nicolas Potel only made 6,000 bottles of this wine in 2021 (instead of 20,000 normally) – yet it’s once again excellent for what is “just” a Coteaux Bourguignons, rivalling some top village appellations. The fruit for this great-value cuvée comes from cooler vineyards on the limits of the Bourgogne appellation in Nantoux (where the vines are 80 years old), Saint-Romain and Nuits-Saint-Georges, classified as Coteaux Bourguignons (an appellation more often associated with reds). The wine is mainly Chardonnay, however there’s a sprinkling of Aligoté adding extra zip.  The nose is honeyed, fresh and mineral, with the palate crisp at first, with clean acidity and superb balance. It rounds out with toasted almond and citrus, building to a long finish that brings a generous dimension of complexity to the wine. It is almost ready to drink now. A superb effort from Potel.  
  
2021 Puligny-Montrachet, La Rue aux Vaches, Alvina Pernot  
This was a particular highlight of our tasting – offering a very different style to Clos des Noyers Brets. Versus the soft purity of Clos des Noyers Brets, this is both more mineral and with a riper core of fruit – juicy white peach and apple, but with a bright, zesty green edge to it, and the very slightest hint of toast. The texture is richer and creamier, offering a pleasingly round yet beautifully elegant mouthful. Long and nuanced finish. This was bottled exclusively in magnum – with just 146 produced.   


2021 Saint-Aubin, Premier Cru, En Remilly, Louis Jadot 
In 2021, there is just one barrel of this Premier Cru – and it’s exclusively available from FINE+RARE. Pithy with flinty, mineral tones that complement an almost orange-zest lift. Behind the citrus and minerals though, there’s a core of fresh, white-peach fruit and toasty, spicy oak that lingers on the finish. The concentrated core is balanced by vibrant acidity, with that creaminess rounding out the lithe palate. Delicious.  


2021 Chablis, Grand Cru, Les Blanchots, Domaine Long-Depaquit  
Domaine Long-Depaquit has 1.66 hectares of this cool Grand Cru. They managed to make just 20% of a normal crop in 2021, the region’s yields drastically reduced by cruel April frosts. This was a particular highlight of our tasting – with an intense, taut, lime-and-lemon profile. Although the fruit verges on lean, there’s a brightness to the wine too. Notes of chalk, oyster shell and Granny smith apple are complemented by a creamy, round character. The finish is long and zesty – classic, pinpoint Chablis.

Jean-Baptiste Lécaillon is a legend of the industry. When he took the helm at Louis Roederer in 1999, he became Champagne’s youngest Chef de Cave, aged just 33. In a rare move for the time, he fought to ensure he was in charge of both the vineyards and winery – knowing that the former would define the wines he produced. Since then he’s continued to push boundaries in the name of quality.  The house is one of the last to remain family-owned and – even more rarely for a Grande Marque – it owns an impressive 242 hectares of vines, providing enough fruit for around 70% of its production. Lécaillon transformed the way Roederer farmed, pushing first for an organic, then biodynamic approach – with half the vineyards now certified organic and half worked biodynamically, and no herbicides used at all. The results speak for themselves – with the house’s prestige cuvée Cristal arguably the finest and most sought-after in the region.  And the man himself is as effervescent as the wines he crafts. Lécaillon is clearly still enchanted by the world of wine –absorbed by its complexities and totally excited by it. Talking to him at a recent tasting, he explains his aim simply: “We are going beyond the bubbles.”  For him, Champagne has traded on its fizz for too long. The wines were once sweet and served with dessert, they then became dry and were used as an aperitif, before becoming inextricably tied to celebrations – a curse that has limited the way Champagne is seen, and savoured. The industry has capitalised on its occasionality, but behind those bubbles – Lécaillon insists – is “a real terroir, a real wine”. It is this exact sentiment that is behind the Grower movement – something that Lécaillon clearly identifies with – however the movement also poses a threat to those trying to source fruit. For the little fruit Roederer doesn’t grow themselves (30% of their production), Lécaillon picks specific plots from around the region and tries to encourage growers to use a sustainable approach. The team will visit the vineyards in spring and summer, and choose the picking date with the grower. While today it’s sometimes tricky to persuade growers to change the way they farm, Lécaillon anticipates a generational shift will take place as more sustainability-invested children take over from their parents. Roederer used to buy fruit from Anselme Selosse, but – naturally –the star vigneron now keeps it all for himself. The fear is that the new generation won’t want to sell their fruit – leaving the Grandes Marques only lesser sites, farmed without the same stringency.  Everything Lécaillon has done at Roederer has been about championing site. He arrived at the house in 1989, but set off instantly for the property’s projects in Anderson Valley, California and then Jansz in Tasmania, returning to Champagne in 1994. Between 1996 and 1998, he worked on a soil study of the house’s vineyards, as well as an archive study – tasting wines back to 1876. When he took over in 1999, he separated all the plots – with 45 specific mid-slope chalky sites dedicated exclusively to Cristal, fruit for the Blanc de Blancs coming from their La Côte estate in Avize and the vintage wine based around Pinot Noir from their La Montagne estate in Verzy.  Changing the viticulture was the next step. In the 1970s, ’80s and even ’90s, Champagne’s soils were a literal dumping ground – with Paris’s rubbish used as “fertiliser”. Lécaillon is one of many that has pushed for change in this area. He feels that organic farming produces better fruit with more dry extract and concentration, but also healthier vines that are stronger and more resistant to the vagaries of vintage – and climate change. Half the property’s vines are now farmed biodynamically – including all the plots used for Cristal.  In a bid to further champion their terroir, Lécaillon established the region’s first private nursery in 2015. He wanted to gather different massale selections from the Roederer vineyards – cuttings from pre-clonal vines that he feels have adapted to climate change and will be key to the house’s (and Cristal’s) future. He claims that it’s the biggest private collection of Pinot Noir in France, and they’ve now expanded the nursery to include not just Chardonnay and Meunier, but all seven of the region’s permitted varieties – including the little-planted Arbane, Petit Meslier, Pinot Gris and Pinot Blanc. The Chef de Cave feels that field blends with these varieties could be the future with climate change – adding freshness to the wine. Over the last two decades, Lécaillon’s work in the vineyard has brought further freshness and precision to the wines – and the introduction of Collection was the latest step in that direction, a move to “bring [the wine] closer to the terroir”.  Cristal might be the jewel in the house’s crown, but a non-vintage blend is any house’s calling card – representing the most significant volume produced (75% at Roederer) and the wine that reaches the most people. It is, Lécaillon says, always the hardest to produce, the most complex to blend – and yet also the one that receives the least attention.  Roederer’s Brut Premier was introduced in 1986, but back then Champagne was more marginal, viticulture and winemaking less advanced, and the battle was for ripeness. In vintage years, the fruit was actually ripe; the art of non-vintage blends was correcting the under-ripeness of the other years with reserve wines. Now, with climate change and the evolution of farming, Champagne has riper fruit than ever before, and an increasing number of vintage-quality years. “The battle now is not for ripeness, but for freshness,” Lécaillon explains. Collection 242 was released in September 2021, with many initially mourning the loss of Brut Premier; people, however, have been won round. As has become fashionable (along with the likes of Krug or even Nyetimber), the wine is “multi-vintage” or “MV” rather than “NV” or “non-vintage”. In Lécaillon’s view, “NV” is “corrective”, whereas, “MV is the story of the new Champagne”. Their aim is no longer consistency, but to make the best possible wine in that year.   He points to 2002 as a pivotal year in the journey to Collection. It was a stunning growing season, with every plot producing wine of vintage quality – but to build a consistent non-vintage wine, they had to “destroy” the quality of each. While Lécaillon feels Brut Premier was an “outlier” in the range, Collection is “more Roederer”, “more Champagne” – which, for him, has to have an oyster-shell salinity.  A key part of developing Collection was creating a perpetual reserve. Held in an enormous 10,000hl stainless steel tank, this reserve is a constantly evolving blend of Pinot Noir and Chardonnay. Started in 2012, it contains wine from every harvest since, stored without oxygen, in the depths of their cellar where the temperature is cool and stable. This, Lécaillon feels, brings extra texture, depth and a “vintage dimension” to Collection – without the heaviness that he saw in Brut Premier.  The blend also includes more traditional reserves aged in oak (around 10% of the final blend), all with fruit from the younger vines in plots otherwise dedicated to Cristal (only 20-year-old vines make it into the prestige cuvée). The most important element here is that the toasting of the barrels is very light, what Lécaillon describes as a “white toast”, so that it doesn’t dominate the terroir.  Collection 242 was followed by 243 last year – and they are two extremely different wines, the 243 riper and richer versus 242’s more mineral expression. This – for Lécaillon – is what makes an “MV” approach so much more interesting, for both him and wine-drinkers. It is, he tells me, “a blank page every year”.  With everything from zero-dosage experiments to rootstock trials, Lécaillon is constantly looking for ways to improve – with a relentless zest and enthusiasm.
