Matthew Fioretti is not everyone’s cup of tea. The man at the helm of Cerbaiona doesn’t mince his words – and he’s got firm views on, well, I suspect pretty much everything. But he’s also unwaveringly honest, with a frank approach that is enjoyably refreshing – and rather unusual in the fine wine arena. He’s got a vision and story, one that he wants to tell, but it’s not one that’s been spun by a PR agency; it’s his. Fioretti has long been involved in the world of wine, running an import business in the US (Summa Vitis), which focused largely on Italian wine. He moved to Italy in 2004, and shut down the Summa Vitis operation in 2009 as he set his sights on making wine himself. After a few false starts, he heard that Diego Molinari – the longtime owner of Cerbaiona – was looking to retire. Along with a group of investors (the most significant of which is the American collector Gary Rieschel), Fioretti purchased the property in 2015, reportedly for €5.8 million. Molinari was in his 80s and it was clear that – while the site itself was exceptional – the property was run down and needed work. As we reported a few years ago, he promptly embarked on a radical project to restore the property and unexpectedly decided to declassify the 2014 and 2015 vintages to Rosso di Montalcino, only releasing the first Fioretti-era Brunello in 2021, with the 2016 vintage – the first to be made entirely by the new team.  Now, almost a decade later, he’s starting to be able to realise his vision for the estate – as we discovered on a visit earlier this year, with problems that “aren’t easy to solve”. The challenge, he explains, has been evolving from an “artisan” to an “atelier”. Under Molinari, the property developed a legendary reputation, but the operation was rudimentary – a traditional, family business, doing things the way they had always been done. Fioretti wants to bring the estate into the modern era, elevating the terroir with technical precision to craft wines that continue the Cerbaiona legacy. It is, he says, “a transition I wasn’t expecting to make”, but one that he feels is essential to safeguard Cerbaiona’s future. The distinction between artisan and atelier is a nuanced one – but one that comes down to an emphasis on craft rather than art, with a commitment to consistency, for which precision and hygiene in the winery are key, as well as a high level of technical knowledge. He confesses that he had envisaged having a more hands-off approach in the winery, having imported a lot of natural wines in his previous career, but has rapidly realised that top-level winemaking is full of “necessary compromises” (diving into issues like the fault quercetin). As a craft, winemaking can’t just be subject to the “whims of the producer”, as he suggests is the artisanal way. “I prefer to work more meticulously,” he explains. The American talks at pace, flitting from TS Eliot and the concept of “the pure critic” to Albertolli and neoclassicism, in amongst technical detail about fining and filtering. The estate is closed to visitors, deliberately to avoid distraction from what Fioretti wants to be spending his time on – making wine. As he whizzes us round the winery, our heads spinning as we try to absorb every detail, he talks us through exactly how he’s bringing new exactitude to the operation. The vineyards have all been replanted and a steep-sloped olive grove replaced with vines, all with selected rootstocks and clones sourced from France’s Guillaume nursery, to give them the best possible raw material. Once seen as too labour-intensive to farm, he’s convinced the ex-olive grove might just be the best site on the property. The rustic old stables and granary that acted as the cellar and winery have been carefully renovated, with water and drainage installed throughout, and the equipment all updated. Importantly, Fioretti has added a full in-house laboratory – something that is exceedingly rare for a property of this size, let alone Italy where the high-tech approach is far from the norm. The fruit is now all chilled after harvest, de-stemmed and cold-soaked, using inert gas to protect the must. While he used upright wooden tanks for fermentation for his first five vintages, Fioretti switched to stainless steel to allow for better hygiene and temperature control (preferring a maximum 26̊C), as well as allowing him to programme them for automated punch-downs and pump-overs. He’s started co-inoculating for primary and malolactic fermentation, meaning the wines go into barrel very clean – and can be sulphured right away. These are tweaks, minor modernisations, but one of the most significant changes Foretti is making is the time the wine spends in wood. While Molinari favoured four-plus years in 500-litre tonneaux, Fioretti has gradually started bottling the wine earlier and uses a combination of 350-litre barrels and 15-hectolitre casks. “Even two years [the appellation minimum] in wood is too long,” he says – before quickly acknowledging that such a view is far from accepted, and he cannot legally reduce it any further. The various consorzios may not like it, but it’s a view that is increasingly common among younger producers in Italy, who are frustrated by minimum oak-ageing requirements and their contrast with the wines today’s consumers want to drink. As Fioretti says, however, “The notion of wood is very delicate.” And while he’d rather be able to age his wine in other vessels during their first two years of life, he acknowledges that élevage in oak has a beneficial impact on the chemistry of wine – aiding stability. With such a beloved wine, it might seem controversial to change anything – especially the way it’s made, but that hasn’t stopped Fioretti. Looking back at older vintages from the estate, even the legendary 100-point 2010, he is sometimes underwhelmed, feeling that there’s much greater potential. Part of his plan to reflect that potential is bottling earlier, allowing the fruit to shine through and give the wine better balance – something he feels is key for ageing potential. He’s also keen to make sure the wine is moderate in alcohol with maximum 14 or 14.2%, even in the warmest years. And most importantly, he says, good wine has to be delicious. Having tasted the 2019 and 2021 with Fioretti – the results so far really are. There’s a vibrancy and purity that makes them irresistible, while not sacrificing the structure that will allow these wines to go the distance. Alongside Cerbaiona, Fioretti has also created the M.L. Fioretti label, one he describes as “part garagiste, part petit château”. He was keen to explore indigenous grapes, which “are part of the family – but not all thoroughbreds”, as well as plots of Bordeaux varietals (grapes with undeniable pedigree) – provided they’re planted in the right place. The Casaglia Colorino is bright and spicy, while the San Vito (sadly the last vintage of which is 2021) is a beautifully lush and vibrant Merlot. These are fascinating wines that allow Fioretti to experiment more – outside the constrictions of the Brunello di Montalcino appellation. Controversially, Fioretti has declared Cerbaiona a “No Scores Zone”, echoing the sentiment of Teobaldo Cappellano that numerical ratings are divisive, at best – and don’t do justice to the craft of winemaking. In his notes on the 2018 vintage, Fioretti wrote: “This is another vintage for the connoisseur, that true lover of wine and the vine. So be it if the ‘collector’ misses out.” Feathers might be ruffled by such remarks, but the motivation here is clear: an earnest passion for wine. It’s something that shines through in our conversation – and in the wines he’s making. No matter how many times you visit, a trip to Maison Leroy never loses its allure. Driving through the quiet streets of Auxey-Duresses, following the soft, chalky blue signs for Leroy that point the way, is always incongruous with the fame of this address. As we’ve written before, you won’t find the grandeur you’d expect from such an illustrious producer – Lalou Bize-Leroy, and her entire team, embodies a rare charm and down-to-earth character that you don’t expect.  I was there to taste the new collection – an occasion which is always remarkable, winding your way through an array of vintages and cuvées of both colours. Bize-Leroy only releases her négociant wines when she feels they are ready to drink, meaning the collection often includes both recent vintages and older wines stretching back 40 or even 50 years. No matter the age, each one has been selected by “Madame” herself, the matriarch with one of Burgundy’s best noses.  This year’s collection is notable for its youth – in all the right ways. Recent collections have included venerable bottles drawn from the property’s extensive cellars – offering a rare chance to taste flawlessly aged fine Burgundy, direct from the producer. This year’s line-up – of course – includes special vintages that will set cellar-hunters’ hearts aflutter, stunning Chardonnay from 1985 and ’79, as well as two reds from 1972, Vosne-Romanée Premier Cru Les Petits Monts and Echezeaux Grand Cru, which Gilles Desprez (Bize-Leroy’s right-hand man) highlighted as some of his personal stand-outs, showing amazing refinement and delicacy, despite their age.  Beyond these historied bottlings, however, you’ll find a selection of wines from the best recent vintages. For the reds, 2018 offers a rich and generous profile, approachable now yet with the depth of fruit to age; 2017 is a vintage of the moment, fully of juicy charm and bright acidity that is irresistible; while there are elegant 2015s and a concentrated 2016.  As for the whites, the 2018s are soft, round and welcoming Chardonnays that nevertheless have everything needed to age, while the thrilling, taut 2014s are just edging into their long drinking window. A similar year, 2010, with high acidity and beautiful balance shines in the line-up – and the vintage is among my favourites for whites.   Desprez notes what a pleasure it is to show these wines, offering a slightly different side to Burgundy for them. Of course, it’s perhaps reflective of current tastes – with a larger range of whites full of vibrant fruit and flinty minerality. For a man fortunate enough to taste more than his fair share of aged Burgundy, these wines are refreshing. While each release is ready for you to pull the cork on, these more youthful releases can also be aged (an excellent excuse to purchase more than one case, if you can, in our view). The line-up this year is really exciting, offering a real range of wines to appeal to all sorts of fine Burgundy drinkers.   We won’t pretend that wines of this level come cheap, but a visit to taste at Maison Leroy reinforces exactly why their name commands such demand. These wines provide a masterclass in fine Burgundy – each one so reflective of its terroir and vintage, archetypal expressions of Burgundian Chardonnay and Pinot Noir. Take the 1979 Puligny-Montrachet Premier Cru Pucelles in this year’s collection, one of the handful of carefully chosen mature wines that feature. Tasting it in the morning, the nose was gorgeously expressive – pristine and mesmerising, yet took a full hour to open up on the palate. Tasting it later in the day, it was still gorgeous – exactly what aged Chardonnay should be – showing how good white Burgundy can be, and a bottle that I won’t be forgetting any time soon.  Highlights from the 2024 Maison Leroy collection 2017 Bourgogne Rouge, Maison Leroy: Offering all the freshness and juiciness that one can find in 2017 red Burgundies at present, this Bourgogne Rouge offers everything you’d want from regional Pinot Noir. It’s very expressive and youthful on the nose, driven by red berries and sour cherries. The palate is lively and offers immediate pleasure, with a nice, savoury, peppery finish that makes it dangerously enjoyable now. Lovely now, this should drink nicely for the next five to seven years. 1999 Bourgogne Rouge, Maison Leroy: It’s been a few years since we last had a chance to taste Maison Leroy’s 1999 Bourgogne Rouge, and it was very interesting to compare this cuvée with the Hommage à l’An 2000 that was re-released last year. By comparison, the 1999 feels like it is still in its teen-years, with a powerful and concentrated profile compared to its millennial cousin. On the nose, it takes a few minutes to open up, but it is understated, elegant Pinot showing some evolution, with wild berries paired with dried petals. On the palate, it is at first interestingly youthful, led by dark fruit. The tannins are powerful, and the concentration impressive. This is drinking beautifully now and should enter its prime drinking window in two to three years. A fantastic showing for a regional appellation! 2018 Chorey-lès-Beaune, Maison Leroy: The 2018 Chorey-lès-Beaune is very perfumed, exuberant with florals and redcurrants. Always livelier and more fruit-forward than Monthélie (especially in warmer vintages), this often-overlooked terroir offers a beautiful level of complexity. On the palate, crunchy red berry fruit and juicy tannins lead on to a beautiful saltiness towards the finish. Its acidity and freshness beautifully balance the richness of the vintage. This is lovely to drink now and should evolve nicely for the next five to seven years. 2016 Santenay, Maison Leroy: Deep purple in colour, the 2016 Santenay is beautifully restrained when compared to its 2017 and 2018 siblings in this line-up. The discreet nose is lovely, driven by red fruit. The tannins are silky, coating the mouth pleasingly. There’s almost a creaminess to the mid-palate. Concentrated and with superb density, this is drinking well now but will benefit from another few years’ cellaring to show its full potential, it should then evolve beautifully for another eight to 10 years given its concentration. 2015 Côte de Nuits Villages, Maison Leroy: Made with fruit from around Nuits-Saint-Georges and Corgoloin, this offers a more austere nose – but it’s a very elegant and subtle Pinot. On the palate, it’s beautifully concentrated, with polished tannins. It starts with rich dark fruit, and there’s lovely acidity on the mid-palate that leads to a long, savoury finish. This is beautifully approachable now and will age nicely for another seven to 10 years. 2015 Gevrey-Chambertin, Maison Leroy: Tasted just after its Côte de Nuits Villages cousin, the 2015 Gevrey-Chambertin offers a beautifully layered nose, aromatic yet serious. Its palate mirrors the profound nose, dense and concentrated with layer after layer of complexity – much more than one would expect for a village wine. Dark fruit evolves into more earthy and spicy notes, finishing on an almost floral finish. This is so subtle and delicate, a brilliant showing for a wine that can be drunk now but would be even more impressive after three to five extra years in the cellar. 2018 Bourgogne Blanc, Maison Leroy: This is aromatic and very expressive on the nose. The palate offers creamy lactic notes, and it’s got a beautiful texture and depth. It shows the ripness of the warm vintage, yet this is complemented by a backbone of minerality – balancing the rich weight of orchard fruit. Profound and lovely for a mere Bourgogne Blanc. 1998 Bourgogne Blanc, Maison Leroy: On the nose this is driven by citrus fruit. There is the slightest hint of pleasing oxidative tones, with richer fruit, yet not overly so – with the wine in pristine condition. It shows beautiful evolution on the palate, with honeysuckle notes and more exotic fruit – yet acidity that avoids risking any overly ripe or jammy character. A very delicate wine, this food to complement its evolved complexity. Drink in the next three years. 2019 Saint-Aubin, Maison Leroy: This is so fresh on the nose – full of white flowers and juicy white peach, it’s mineral, lovely and expressive. On the palate, however, there’s unexpected density and texture. This is super concentrated and youthful, yet also very enjoyable now – and one of those wines that will keep showing different facets with air, and long after you’ve swallowed a mouthful. This will need time to show its full potential, but is already glorious. 2019 Auxey-Duresses, Maison Leroy: This was our favourite in the line-up of 2019 and 2018s this year. Auxey-Duresses is a village that is often overlooked but that Madame Lalou Bize-Leroy masters. The nose is multilayered, showing riper notes than the Saint-Aubin, but more acidity too, and with a mouthcoating texture that almost feels weightier than the Meursault. This is very 2019, in the sense that it combines great richness and freshness. This is lovely and long, with a finish marked by creamy, lactic notes. Drink it now and over the next five to seven years. 2018 Meursault, Maison Leroy: This offers a dense nose packed with layers of complexity, yet it’s also very subtle and discreet. This will need a bit of time to fully show its character, as the layers peel back in bottle. With aeration, the wine unfurls with richer, riper stone-fruit notes. On the palate, there are hints of creamy, brioche-like notes, along with real density of fruit on the mid-palate – a rich and weighty wine. There’s a lovely long finish. If you can, give it another five to seven years in the cellar, as the wine is so tightly packed and concentrated that you may miss out (although it’s hard to resist now!). 2014 Chassagne-Montrachet, Premier Cru, Les Chenevottes, Maison Leroy: This is very expressive and fragrant on the nose. Still fresh and intense on both the nose and palate, this lively wine speaks of this brilliant white Burgundy vintage – and is only just entering its drinking window. It offers such a complete set of aromas from the rich, ripe notes of fresh fruit to more herbal, citrus notes, all driven by brilliant acidity and a hint of bitterness. Lovely – and one of our favourite whites in the collection this year. 2010 Chassagne-Montrachet, Premier Cru, Morgeot, Maison Leroy: This Morgeot has such a lovely nose, offering a mix of sweet apple and honey-flavoured candies. It is concentrated and powerful on the nose, mature yet still has a lot to say. On the palate, the acidity is striking from the moment the wine touches your tongue. It opens with fresh, mineral, crystalline notes, but this is immediately followed by a wave of ripe yellow fruit, and then some sweet spice which lifts the wine on towards its persistent finish. This is beautiful now and should stay in this zone for another five to seven years. 1979 Puligny-Montrachet, Premier Cru, Les Pucelles, Maison Leroy: With a beautiful golden colour, this is so impressive on the nose, with so much going on: honey, beeswax, frangipane, creamy and lactic notes, candied orange peel, crystallised fruit, it just keeps delivering on the nose. The palate seems a bit muted by comparison, when tasted just after opening – but after an hour or so you’ll find the same level of density and richness here too. All those aromas mingle together and melt into each other, yet there is a sense of harmony, with beautiful acidity throughout. The wine feels like there are so many layers and strands to it, but it is also so complete. Towards the finish, there is a certain salinity that drives the length of the wine, alongside those honeysuckle notes. A real delight that is approaching its prime though still has a lot to say! A masterclass in fine Burgundy: Maison Leroy

Auxey-Duresses is, at best, sleepy. As I rolled into the village on Monday morning, the streets were empty in the grey of a rainy winter’s day – just one retiree trundling slowly toward the boulangerie. But here, in this quiet corner of Burgundy, lies the home of Maison Leroy.  A visit to the négociant arm of the Leroy empire is a chance to look behind the curtain at one of Burgundy’s greatest properties, and the allure of such an audience doesn’t fade – even now, on my 12th visit. The wines are remarkable – and rapidly vanish into the cellars of eager collectors as soon as they’re released.  Despite the prestige of this address and its wines, however, it’s a humble, rural Burgundy charm that reigns supreme. Soon after I arrive, the phone rings – it’s Madame Lalou Bize-Leroy herself calling from the south of France to say hello, apologising that she can’t be there herself and hoping that the wines are showing well. There’s no pretence or politics, just modest and unassuming politesse.  And that style is characterised by the building itself. The Maison feels like a home – one that hasn’t changed for 30 years, with stacks of books squirrelled into every corner and the walls lined with articles, photos, reviews and other mementos. One could spend hours exploring this living archive. In amongst every issue of Bettane & Desseauve’s guide and issues of the Wine Spectator stretching back to the 1990s, there’s a picture of Bize-Leroy with Nixon, while nearby there’s a hand-written note from one Bob Parker.  Each year the Maison releases its annual collection – not just the latest vintage but a curated selection from the house’s extensive reserves, all hand-selected by Lalou Bize-Leroy herself. In September, she and her team start preparing the list, tasting endlessly to decide which wines should be set free into the world the following year. And there is an extensive back-catalogue to choose from – Bize-Leroy has been buying the very best parcels she can find for half a century. Over four months, the team decides what to release – wines that are drinking well or showing something that catches Bize-Leroy’s eye (or, more accurately, her palate).  While each collection used to be extensive, the releases have become increasingly focused. This year sees 10-15 reds and whites – and is particularly appealing to the wine geek. The collection is dominated mainly by 2017 reds and 2018 whites, however each one is paired with a more mature vintage of the same wine (or as close to as possible), stretching back to 1970. Inevitably, the older vintages are available in tiny volumes – but they’re testament to how age-worthy these “mere” négociant bottlings are.  Tasting through the range, the 2017 reds were a particular highlight. Even at 10am it was a challenge to resist swallowing – they are irresistible with their pure, crunchy fruit, so fresh and delicate with great persistence and complexity. The 2018 whites, meanwhile, from a warmer year are only just entering their drinking window and will gain with more time in the cellar.  Last year we couldn’t make it out with Covid restrictions, so it was all the more special to be back at Leroy this week. Emerging once more on Auxey-Duresses’s unassuming streets, I left even more in awe of this amazingly humble address.  Tasting notes: the Maison Leroy 2022 collection White 2018 Bourgogne Blanc: A pale lime-tinged colour, Maison Leroy’s 2018 Bourgogne Blanc is a bit shy at first, but with air opens up to reveal a fresh, floral nose. On the palate, the wine broadens, with layers building in the mouth to bring richness and stone-fruit notes. There’s a slight puppy fat to the texture at present, but this is lifted by vibrant acidity, making for a moreish wine overall. This is very different to last year’s sharper-angled 2017; the 2018 is a much more gourmand wine that will go beautifully with food. Drinking well now, it will age eight to 10 years without breaking a sweat. 2018 Saint-Aubin: Golden and concentrated in colour versus the Bourgogne Blanc, the 2018 Saint-Aubin has a profound, expressive nose – with limey tension. The palate is driven by a mouth-watering salinity, complemented by layers of vibrant citrus – blood orange, lemon and grapefruit – on show. Harmonious and balanced, the finish is long. Might need more time to reveal its full potential, but there’s no doubt that the potential is there.  2018 Meursault: Maison Leroy’s 2018 Meursault is attractive and concentrated with ripe, juicy white peach pulled fresh from a tree in the summer. But it’s far from simple fruit here – with honeycomb and grapefruit adding to the overall profundity. On the palate, there’s incredible tension between the ripeness of the 2018 vintage and a mineral acid backbone. Very vibrant and approachable, this offers depths that defy its status as a village wine. As with the Saint-Aubin, it will offer more with time in bottle.  2018 Meursault, Premier Cru, Les Genevrières: A step up from the village Meursault, the Premier Cru Genevrières offers even more concentration. The deep, complex nose is full of yellow stone-fruit, white blossom and hints of hazelnut. On the palate, it’s mouthcoating, but the concentration is not overblown – there’s precision and focus, with a saline mid-palate and mouth-watering acidity to complement the wine’s generosity. The finish is impressive, combining sharp-angled freshness and the wine’s sumptuous volume. This is built to age but is approachable now. 2014 Chassagne-Montrachet, Premier Cru, Les Chenevottes: The 2014 Chenevottes is expressive on the nose – it’s a wine with a lot to say. There’s a hint of reduction, but beyond that layer upon layer of aromas is revealed, showing different facets. Floral, lime and orange notes evolve on the palate, developing into deeper stone-fruit, ginger and honeysuckle. There’s a wash of salinity on the long finish that lifts the wine. Totally approachable now, this will age effortlessly for 10-15 years. Red 2018 Bourgogne Rouge: The 2018 Bourgogne Rouge from Maison Leroy is beautiful – punching well above the weight of its modest appellation. The nose is poised, perfumed and delicate – with expressive dried rose petals dancing against a backdrop of pure raspberry, wild strawberry and cherry fruit. There’s great density on the mid-palate, the alcohol and tannins seamlessly integrated with vibrant acidity from this warm vintage. It’s our favourite release of the cuvée for several years. 2017 Côte de Beaune Villages: Maison Leroy’s Côte de Beaune Villages is a blend of village fruit; while the exact blend is never disclosed, it can span the whole Côte, from Maranges to Beaune. The nose of the 2017 is exuberant, with sweeter and darker fruit than the Bourgogne Rouge, while a hint of smokiness gives a savoury edge. It’s both fresh and dense on the palate – there’s underlying power, yet the fine tannins make it feel light on its feet. The finish is long, laden with crunchy fruit. Very approachable now.  1997 Côte de Beaune Villages: The 1997 is remarkably dense in colour, with mature aromas of cured meat and very concentrated dark fruit. From a riper vintage versus the 2017, the richness of the fruit is evident here, however there’s still good balance on the palate with plenty of acidity and resolved tannins. It’s at a beautiful point of maturity, unlikely to gain from further ageing, but there’s no rush – with sufficient density to hold for five to 10 years. 2018 Savigny-lès-Beaune: This Savigny-lès-Beaune is deliciously enticing – a nose of archetypal, crunchy sour cherry. While it’s red fruit that draws you in on the nose, the palate shows a more serious side, with complexity building in layers. Freshness and finesse runs through the palate, with a vibrant acid backbone and lifted finish. Verry attractive and approachable, this is a superb, moreish wine that will keep you reaching for more.  2018 Beaune, Premier Cru, Les Montrevenots: This vineyard borders Pommard, sitting just above Beaune Clos des Mouches on a gentle southwest-facing slope. This Premier Cru site instantly shows more depth than the village wines, with an expressive, multi-layered nose with shifting cherry, blackberry, plum and wild strawberry aromas and an alluring hint of smoke. On the palate, the vibrant red fruit and freshness of this site and youthful Pinot Noir mingles with the ripe and serious dark-fruited side of the 2018 vintage. Beautifully balanced, this can be drunk now but will evolve nicely for 10 years or more. 2017 Nuits-Saint-Georges: The shift to the Côte de Nuits is instantly noticeable here. The wine has a deep colour and more austere, serious nose – with dark-fruited power accented by lighter white pepper spice and florals. On the palate, layers of bramble fruit build to create a concentrated and structured wine. There’s a firmer tannic backbone as is typical of Nuits-Saint-Georges, without being overly grippy. With underlying power, this is an aristocrat. The depth and balance here offers great potential, hold onto this for 15 to 20 years at least. 2017 Chambolle-Musigny: This is still beautifully aromatic on the nose, with a delicate, lace-like array of fruit and florals. This is pretty and refined, yet with underlying powerful. There’s a lot happening on the palate, with a certain juiciness balanced by tannins that are already beautifully silken. Despite the supple tannic structure, this feels like a baby – and will only deliver more with time in bottle. The length is stunning, lasting for minutes. Punching well above village level, this was a new favourite in the line-up – and one of the most promising in the range. 2017 Gevrey-Chambertin: This was the most concentrated wine in the line-up – both in terms of colour and aroma. Combining depth, complexity and power, this is impressive, with a multidimensional nose that keeps evolving in the glass, showing different facets from sweet cherry to gentle sweet spice and floral notes. The palate is turbo-charged – mouth-filling and generous, yet all the while retains superb balance. The tannins are chewy and plentiful, yet all wrapped in silk, bringing an overall impression of finesse. There’s incredible length, with a fresh, juicy finish. As with the Chambolle, this will only improve in bottle. It’s interesting to taste it side by side with the Chambolle-Musigny, each anchored in their terroir, but sharing finesse, poise and elegance. Ardross is a new Scotch whisky distillery. You’d be forgiven for rolling your eyes about now. Over the past few years there’s been a spate of new distillery openings across the bucolic Scottish landscape and each espouses to be different from the last. Many have an impressive roster of whisky talent at the stills and little expense has been spared on the distillery itself and surrounding architecture. This is something Ardross Single Cask Society founder Barthélémy Brosseau is all too aware of. “I wouldn’t want us to be completely perceived as normal,” he says. “What I mean by that is that we have a great building, great location, great people, great quality spirit but everybody is claiming more or less the same.” As the name may suggest, Barthélémy – or Barth as he introduces himself – Brosseau was born in Bordeaux and is a very atypical Scotch whisky distillery founder. “You don’t see me wearing a suit and speaking very gravely about the Scotch whisky tradition with a Scottish accent, and there is a reason behind this,” the 32-year-old adds. As he is quick to point out, with a smile that rarely leaves his face during our one-hour call, when it comes to the whisky, he takes a giant step back. “Who am I as a Frenchman to tell them how to produce Scotch whisky?” This side of the business is very much driven by distilling legend Andrew Rankin of Bowmore fame. When we speak, the Ardross team is preparing to officially launch its Single Cask Society. A website is in development with an ever-nearing launch date (the designers require a “bit of a kick”), the existing 49 members are regularly in contact with Brosseau (he has most of them on WhatsApp), and he’s not getting quite as much sleep as he might like after the birth of his second daughter. With all these plates spinning, you’d forgive him for being a little flustered. Instead, he is cool personified. He seamlessly weaves the conversation from topics including, but by no means limited to, philosophy, travel and literature (Leo Tolstoy’s War & Peace is among his favourites). It is soon apparent why Brosseau is the butterfly in the company logo. With his tendency to flit from one subject area to the next and, to take his more philosophical approach, his current emergence from a chrysalis of sorts into the Scotch whisky world. Conversely, Rankin, with his near 50-year experience, is the steadfast, knowledgeable other animal in the logo. “Don’t tell Andrew he is the tortoise,” the Frenchman says with that smile. This symbiotic relationship in many ways is an unlikely one, but it’s key to Ardross’s current and future success. “Without Andrew, we would not be where we are today,” Brosseau says. “It would be an absolute mistake for me to say that I am driving this. Andrew is driving Ardross as a distillery and it is thanks to Andrew and his connections in Jerez, in Japan, in the US that we are where we are today. “I have all these crazy ideas and he is the wise guy who has the years and the knowledge and the erudition. And that is why it is interesting – sometimes we are completely at odds. And that’s normal. And from this friction, I think, that creativity ensues.” Ardross is the Scotch whisky arm of Greenwood Spirits Ltd, which is owned by Vevil International who boast London’s The Ned and The Wolseley in their impressive portfolio. Part of their modus operandi is faithfully restoring and renovating Grade 1 and 2 listed buildings and Ardross was no different. After seeing the opportunities that lay within the Scotch whisky sector, the team quickly recognised the need to partner with an industry icon for the project to succeed. After meeting Rankin, the team gave him a mandate to find the Scotch whisky with a big vision a new home. Rankin describes finding the beautiful dilapidated farm called Ardross as serendipitous. He recalls seeing the six- to- seven acre Loch Dubh and snow-covered pine trees, and falling in love right away. The 50-acre site with 19th century farmhouse buildings has since been restored brick by brick at the cost of £30 million and a new distillery built to produce a traditional, quality single malt with a slightly sweeter profile. Although expectations were high after such an investment and the assembly of a production team with a combined experience of over 150 years, few could scarcely have imagined the quality of the spirit after one run. Rankin says it was a “Eureka moment” when they realised the new-make spirit was 95% of the way there – this process typically takes two to three months. The reason for this success right off the bat? Extremely long fermentation times of 121 hours (compared to the industry standard of 60), one of the best, if not the best, production teams in the business, and a relentless pursuit of quality, according to Brosseau. The only thing left to create the Ardross single malt they’d all envisaged was the wood and time itself. For this, Rankin drew on his industry ties and sourced the highest-quality wood from Jerez, Kentucky and Japan. Even for seasoned professionals with decades upon decades of whisky distilling experience under their belts, the chance to work at a new distillery from day one represents a career first. Despite all their achievements, of which there are many in the case of this team, to a certain extent they have been following somebody else’s blueprint and colouring within the lines. Working at a distillery like Ardross, with all its financial backing, represents an opportunity for this illustrious team to create their own blueprint in a way that only 150 or so others ever have. And Ardross, arguably more than most, has the flexibility to dictate what this framework should look like. “We have the luxury of thinking about the future almost in generational terms,” Brosseau says. “We are insulated from the vagaries of short-termism.” Brosseau says the decision was made early on to remain an independent distiller and not team up with the “big boys” for investment or distribution deals. He doesn’t rule this out in the future but says this approach has given the team an opportunity to learn and get their own scars and will make their growth and achievements that much sweeter because they have “done it all themselves from the beginning”. In addition to the distillery, Ardross also owns its own bottling line and warehouse, so they’re not dependent on others. Where other distilleries might be burdened with lofty marketing and distribution costs, and fielding shareholders’ dividends demands, Brosseau says Ardross is “resolutely adopting a different stance”, will not rush to produce a non-age-statement and is under no pressure whatsoever to bottle whisky until the team is good and ready. “For us, Scotch whisky is about time. It is about the long term,” he adds. “The idea is that when you are entering Ardross as a member, you are with us for the long-term and the value proposition unfolds over time. “If you are in a rush and you want to buy your cask and sell the next day, we are not for you. And we are completely honest about it. Go elsewhere basically.” The French charm quickly returns and he says with a smile: “I mean, you will always be welcome of course – but what I am saying is you won’t potentially be happy.” While he is tightlipped about how this value proposition might unfold, Brosseau teases it won’t be via “necessarily classical routes”. “We are not putting everything in front of you all at one time,” he explains. “The idea is to make you discover, or enter our world, almost sequentially. It’s frustrating I think for people sometimes because we live in a world where everything is available straight away – one click and you have everything you want. “And we are quite contrarian in that regard. We are not building right now to enjoy the fruits right away. The idea is to build value and the ripeness of the fruits come over time.” For this reason, and many others, Brosseau says Ardross is “very reasonably priced”.  “You have lots of people today who are selling whisky casks that they don’t really own,” he adds. The Frenchman describes the cask investment trade as a “complicated one” and is very gallant in not wanting to discuss other schemes that are slightly less above-board. Instead, he says: “We are not trying to fool anyone. We know who we are and we know what we are doing quality-wise. “We’re not pretending to be Macallan or Dalmore or whomever. We have a world-class quality team with world-class expertise, among the best in the industry. But we don’t have 200 years of history.” Whereas other propositions might require an accountancy qualification to understand, Brosseau says Ardross is “doing something that is very simple”. “We have the credibility of the industry professionals in everything that is related to production. For the rest, we are out-of-the-box thinking professionals.” While he might not be willing to divulge the “special” things Ardross is doing at the end of this year and next, we can speculate it’ll be worth the wait. After years of painstaking renovation and restoration, the £30 million Ardross project is about to take off. Single Cask Society founder Barthélémy Brosseau tells Holly Motion all about the contrarian Northern Highlands distillery’s transformation and why this team is proud to be different

Ardross: the butterfly effect

The growing season The winter was mild with plenty of rainfall to replenish water reserves. The mild winter, combined with a dry spring, led to early budbreak, followed by a cold snap in April and May with pockets of hail and frost, and late flowering. June brought a heatwave – kicking off a warm, dry summer. Between June and mid-September, seven in 10 days exceeded 30˚C. At Domaine Saint-Préfert, Isabel Ferrando saw the mercury rise as high as 44.3˚C on 28th June. Having sufficient canopy to shade the grapes sufficiently was key, with a risk of sunburnt grapes – something not everyone escaped. Stéphane Usseglio reported that June’s rainfall was the same as in 2017, putting it amongst the driest years since 2004.  While the spring frost and hail had caused little significant damage, a torrential hailstorm on June 15th caused serious damage in Crozes-Hermitage. Golf-ball-sized hailstones pounded vineyards for 20 minutes and some producers lost as much as 80% of their crop. Fortunately, it was a localised attack. The dry weather meant the fruit at harvest was disease-free, with picking starting in early September. Some rain arrived on 18th September (15mm), welcomed by producers such as Ferrando who felt it added additional balance to the grapes. The growing season’s dry conditions produced small berries that produced very little juice, meaning yields were down by up to 40% (or more in Crozes). The wine made, however, benefited from more concentration thanks to the high skin-to-juice ratio. The wines Much as with Burgundy 2019, producers were surprised by the level of acidity in the juice and wines, which offsets the ripeness and concentration of the warm conditions. Where producers picked at the right moment, the resulting wines are outstanding and have great balance. In general, the South fared better than the North, with Grenache and Mourvèdre better suited to handling the hot, dry conditions.  Stéphane Usseglio describes the 2019s as "rich, complex, profound and velvety, opulent as Châteauneuf-du-Pape can be, yet surprisingly fresh, given the nature of the vintage.” He felt that his biodynamic practices (certified since 2015) were key in countering the effects of warmer years like 2019; using a chamomile tea spray to reduce hydric stress, for example. He is also tweaking work in the winery, with fermentation temperatures in recent years now cooler – around 26˚C (previously 32˚C) – to preserve the wines’ fresh fruit character. His vineyards are divided equally between stony and sandy soils, but felt both produced different but excellent, concentrated and lush wines in 2019. It was, however, the old-vine Grenache on
La Crau that goes into his Cuvée Impériale that stands out, and he feels it is the finest rendition of the wine since 2010.  Isabel Ferrando also emphasised the balance of the wines – with a natural concentration and acidity that implies long ageing potential. She felt that her Colombis cuvée – sourced from sandy plots – really excelled, as did her plots of Cinsault and Clairette. Saint-Préfert’s old-vine Cinsault (planted in 1928) is now going into a varietal wine, F601 and it is “explosive, full of fruit” in 2019; while she found Clairette’s natural minerality and liveliness, meanwhile, really comes through in the vintage. Overall, she finds the wines “spectacular, deep and energetic”; it is undoubtedly, in her view, a great vintage. Perrin noted the balance, finesse and complexity of the year; while Chapoutier highlights the elegance of the reds and particular minerality of the whites. Claire Darnaud at Delas compares the vintage to 2009 in style, but with more minerality holding everything together – something she attributes to the granite in her vineyards. This mineral feel is what for her prevents the wines feeling overly ripe or plump. Usseglio compares the 2019s to the stunning 2016s, but with a little something extra. He considers it “a hybrid between the concentrated and muscular 2005, and the elegant 2006”. Others are comparing the year to 1990; but the ageing potential of the best wines is clear.  The critics’ view Not everyone’s reports on the vintage have been published but the year has so far been well reviewed. Wine Advocate’s Joe Czerwinski noted late last year that the few 2019s he’d tasted “the reds… show ample ripeness and concentration without any evidence of cooked fruit, while the 2019 whites as a group look excellent, particularly those from Clos des Papes and Domaine du Pegau.” Josh Reynolds (Vinous) describes 2019 as “a vintage of extremely high quality and… the fifth straight stellar year for the region”. He emphasises the freshness and detail in the wines – a surprising trait in a year with such hot, dry conditions – with “an uncanny blend of depth and vivacity”. Jeb Dunnuck (who will report fully on the wines once bottled) feels they are a step up from the 2018s, offering “more depth, concentration, and richness, all while showing considerable purity of fruit and elegance”. Like the producers, he notes the wines’ “focused and lively” style, with “impressive aromatics” and no sign of over-ripeness. He also highlights the beautiful tannins the warm conditions produced, feeling they are concentrated with “serious potential” and feeling it will be “near the top of the pyramid in modern-day vintages”.
