Sitting opposite us, the dark-suited, dark-haired figure waved an elegant hand at the bottle of white Burgundy which he’d just fished out of a carrier bag and planted on the table with the air of a conjuror at a party. “You’ll like this,” he said; it was a statement, not a suggestion, delivered in a faint accent with American overtones and a hint of gutturality. In this totally unremarkable West London pub, a bottle of Meursault looked as out of place as a KGB officer. Which he was. We did like it, of course, who wouldn’t? It made the greasy steak and chips almost bearable, and was one of the best wines I’d ever tasted at that point in my life. I was 33 that year, 1978, and as a newish BBC foreign correspondent I wasn’t particularly well paid. He’d brought the Meursault with him to show us how sophisticated he was, and to counter the blandness of the food. But why had he suggested The Mitre as a place for lunch? It was handy for the Soviet embassy up the road, certainly; but I realised that the real attraction for him was the high-backed seats that enclosed our table and kept our conversation private. Sergei was a major in the KGB, masquerading as a press attaché. The habit of secrecy was deeply ingrained in him. The Meursault started to work on my companion, a gossipy, amusing, slightly naïve BBC executive. It worked on me, too, but under the influence of alcohol I tend to go quiet and introverted. Not so Harry. He delivered the brief lecture about Soviet harassment of our Moscow correspondent which he’d been planning. It wasn’t bad, but it didn’t make Sergei burst into tears. On the contrary. “Ah, yes, the famous Declan.” Sergei managed to put the accent on the second syllable. “Such good Russian. A pity he wastes his time hanging around those drop-outs and wastrels.” I was particularly impressed by ‘wastrels’. “I suppose you mean dissidents,” I said, pushing my glass across for more Meursault. The label read ‘1968’; the Soviet embassy must have had a superb cellar. Sergei laughed scornfully and poured. “I hear Declan’s marriage isn’t going so good now,” he said. “Ah, no, his wife left him for an airline pilot,” Harry replied, giggling. I kicked him sharply: you didn’t feed personal details about your colleagues to KGB officers. “What?” Harry said, looking at me. We saw the bottle out. Sometimes I think I can still taste that rich, green-gold collection of butter, almond, citrus and, could it have been, or is it just my imagination after more than 40 years, hints of bracken and mayflower. At the end, we stood up and shook hands. “So you’ll go easy on Declan from now on?” Harry said. “Well, Declan must stop creating bad propaganda against the Soviet Union.” He had a good ear: this time the accent was on the first syllable. Sergei turned in the direction of the embassy, and we headed back to Television Centre. “Bloody good wine those Russkies can afford,” Harry said, and gave his high-pitched laugh.For journalists and spies, booze is a famous lubricant, a fuel, even. I came from a teetotal background, yet when I started as a foreign correspondent I soon found myself ordering a glass of single malt as a means of self-protection, while someone I was trying to pump for information opened up and talked in a way he or she never would if I’d ordered a Britvic orange. Yet there were exceptions. In Belfast and Derry, where I started my reporting career, the leaders of the Provisional IRA were mostly ultra-Catholic and never drank a drop; and as I branched out and began reporting on the Middle East, I found that organisations like Hezbollah and the followers of the Ayatollah were as teetotal as I had once been. There were no bars to meet them in, either. Fortunately, though, cities like Cairo and Beirut were more sophisticated. I soon found that anywhere with a sizeable Christian population, Egypt and Lebanon, of course, but also Syria, Iraq and westernised countries like Turkey and Pakistan, made allowances for thirsty westerners and permitted them to drink, even if in cities like Peshawar you had to sign a big leather volume and register yourself as an alcoholic. The bar in the old Commodore Hotel in Beirut was a wonderful centre for professional alcoholics of this kind. I first went there in June 1982, when West Beirut was under hourly attack from Israeli planes and tanks, and there were no shelters to protect us. The presiding spirit of the place was a correspondent called Chris Drake, a hospitable soul who dispensed booze and information even-handedly. When the barrage was going on, it would have been suicidal to leave the Commodore, and the building shuddered to every nearby explosion. Chris Drake had a parrot, and when the bar was packed in the evening with journalists glad to still be alive, it would imitate the sound of a shell in flight with startling accuracy. Most of the people there, not me, thank God, had walked into the bar on their first night, heard the parrot’s hugely convincing whistle, and thrown themselves on the floor shouting “Incoming!”. There would be a roar of laughter, and someone would help them up and offer them a glass of arak, an infusion of grapes and the seeds of the anise plant. I acquired a real taste for arak at that time, and I still think of that slightly oily, metallic, liquorice-tasting liquid hitting the back of my throat and burning its way down. A few years later, during another upsurge of fighting, the Commodore was heavily shelled by the Syrian army. The building was destroyed, and no trace of the parrot was ever found. When peace was restored and there was money around, the Commodore was rebuilt, much bigger and more glitzy, but the architect designed a new bar precisely where the old one had once been. You can still see the space on the floor where many a famous journalist measured his length when the parrot did its party trick. I took my wife and 13-year-old son there a couple of years ago, and one afternoon, when the bar was empty, my son insisted on re-enacting the whole thing. In China, things were different. Meetings with underground figures usually took place at their homes or outdoors, given the fear of surveillance. I often chose Ritan Park in Beijing, where teahouses served pu-erh tea and offered a discreet place to talk. By contrast, official meetings required alcohol, specifically Maotai, a fierce baijiu distilled from sorghum at over 50% ABV. At one banquet, after being insulted by a local Party official, I tried to outdrink him. The plan failed, he had help, but we still ended the night collapsed together, singing in two languages. The next day, I was told this had enhanced British prestige. Countries where alcohol is banned present different challenges. In Taliban-controlled Afghanistan, I smuggled in a 27-year-old bottle of Laphroaig disguised as Fanta, only to pour it down the toilet when soldiers began searching rooms for alcohol. They never entered mine. After the fall of the Soviet Union, I tried to track Sergei down but never found him. Before that, though, I had taken my revenge by signing him up to every unwanted mailing list I could find, encyclopaedias, dubious magazines, and more inventive subscriptions besides. It made me feel very good.And yet, if I imagine meeting him again, I always picture the same thing: Sergei standing in the doorway, holding a superb bottle of Meursault. For that, at least, I’ve always been grateful. “It’s been an absolute pig of a year,” says Mark Gaskain. It’s September 2024 and we’re reaching the end of what has been a trying growing season across most of Europe – with seemingly never-ending rain. Fortunately, Gaskain knows that such challenges are just part of the job. He’s a farmer, born and bred, now at the helm of his family business, and responsible for growing 70 million apples a year. But in the last decade, he’s added a new strand to the business – after selling a swathe of land to none other than Champagne Taittinger in 2015. That land is now the home of Domaine Evremond – one of the most exciting English wine projects to date.  The story began almost a decade ago. Patrick McGrath – founder and CEO of Hatch Mansfield, which represents Champagne Taittinger in the UK – had been looking at adding an English sparkling wine to the company’s portfolio. It was the early 2010s, and he spied an opportunity with the burgeoning category – but Pierre-Emmanuel Taittinger suggested that, rather than taking on an existing estate, McGrath should create his own, working with Taittinger. Taittinger had embarked on a similar venture in California, creating Domaine Carneros with their US agent, Kobrand, under Pierre-Emmanuel’s uncle, Claude. Together, they decided to take the plunge.  They charged leading English wine specialist Stephen Skelton with helping them find the perfect site – determined to have chalk soils, south/southwest-facing slopes (for maximum sun exposure) at altitudes below 100 metres (with temperatures reducing by 1°C per 100m, anything above this would simply be too cold in England’s marginal climate). Kent – with easy access across to Champagne – was decided on, but it took them 18 months to find the right site. At the same time, the Gaskains were looking at selling some of their land (a foray into soft fruit had proven challenging, and were looking to get back to their core business of apples). The timing was fortuitous and the orchards at Stone Stile Farm – around the village of Chilham, southwest of Canterbury – were perfect. As Alexandre Ponnavoy (Chef de Cave for both Taittinger and Evremond) told me, if a site can grow good fruit – it’s a good indicator for its viticultural potential.  In 2015, the deal was signed and the project launched with great fanfare at Westminster Abbey. Domaine Evremond takes its name from Charles de Saint-Evremond (1614-1703), a Frenchman, essayist and early ambassador for the wines of Champagne – bringing them to the court of Charles II – who is buried in Poets’ Corner. Although Didier Pierson – a grower in Champagne – had made English wine under the Meon Hill label, Taittinger was one of the first major Champagne Houses to invest in England (Pommery had bought vineyards in Hampshire in 2014). Unsurprisingly, press coverage was extensive: the Champenois were coming to make sparkling wine on our home turf – the French naysayers set to eat their hats as the world started facing up to fine English fizz.  Evremond’s first vines went in the ground in 2017, with more added in 2020 (the team set up at the local Premier Inn to tackle the work mid-pandemic) and in 2024. The land here has a layer of alluvial clay over its chalk subsoil which is part of the Paris basin, shared with much of northern France (including Champagne). Around Canterbury, however, there’s more flint in the soil – something that Ponnavoy feels shines through in the wine, giving it a mineral, reductive character. There’s also a definite maritime influence – moderating temperatures, but also bringing ocean breezes from Whitstable, which is just six miles away. For Ponnavoy, it’s the combination of the site’s chalky soils, maritime softness and sea winds – a “contrasting climatology” – that defines the Evremond wines.   Gaskain is deeply involved in the project – his in-depth knowledge of the land an invaluable resource, knowing where potential frost pockets lie, for example, or where the soil might be overly rich for vines. He and his team manage the site day-to-day, guided by Christelle Rinvelle (Taittinger’s Vineyard Director). Currently, they have 62 hectares of vines, split between 45% Chardonnay, 45% Pinot Noir and 10% Meunier. They planted Chardonnay on areas with the thinnest topsoil, allowing its roots almost direct access to the chalky bedrock, while the Pinot Noir and Meunier sit on the more clay/gravel-rich plots.  The vines are widely spaced (5,000 vines per hectare – half the vine density Taittinger uses in Champagne) and trained higher than across the Channel, allowing for better airflow (helping manage disease pressure) and a larger canopy (to aid ripening). While herbicides have never been used on the site and there’s a concerted effort to be sustainable, Gaskain is clear on the limitations of viticulture in Kent: “Organics is madness in this climate,” he tells me – as, perhaps, 2024 proved. While the team has vine-specific sprayers, Gaskain can also draw on his team’s orchard equipment too – a boon when conditions are challenging – and spray the entire site in one (rather long) day.  They harvested tiny quantities of fruit in 2018 and 2019, with the first commercial-sized vintage coming from 2020 (conveniently the grape harvest falls neatly between that of Galas and Braeburns). Early wines were made at nearby Simpsons, and from 2020, they set up in an old concrete barn on the site – with the entire operation run on a generator. In June 2022, they broke ground on a new winery (“We were over budget four weeks after starting,” says McGrath, with a weary smile). The same company that worked on the Channel Tunnel dug out 83,000 tons of chalk (around 2,000 lorry loads) to make way for the three-storey building that stretches 20 metres below ground. Designed by Reims-based architect Giovanni Pace, the idea is for the winery to blend into the landscape – rather than stand on it. It has the capacity to cellar 1.5 million bottles – all without expending any additional energy on cooling, thanks to its natural subterranean chill.   Works were finished in time for the 2024 harvest – a relief undoubtedly for the team. There is something charmingly British, slightly ramshackle and underdog about the operation – despite the very serious money behind it (£17 million invested so far, reportedly). “Everybody’s had to muck in,” says McGrath. He might be Hatch’s CEO and one of the Evremond founders, but he’s also the first to pull on his wellies to help with harvest – and has spent more weekends in the vineyard than anyone else. Vitalie Taittinger has taken over from her father as President of Taittinger, and McGrath’s daughter India is running the commercial side of Evremond – meaning the operation really is a family business, even if it comes with some luxury, Champenois-esque swagger.  With the Taittinger association, of course, expectations are incredibly high – something McGrath is painfully aware of. Talking to Ponnavoy – who is in charge of the winemaking at both Taittinger and Evremond – there’s been something very exciting about creating a project from scratch, even if it has come with some challenges too. He argued to keep the small 2018 harvest for the property only, allowing them to follow the wines in tank over several years, and get to know the site. It was a huge cost, and delayed the first release, but something he felt was crucial.  “It was really important not to do a copy of another sparkling wine, not to produce a… ‘style’,” he says. Their goal, instead, was: “To identify the terroir, to identify the soil, to identify the climate, and reproduce all that in the bottle. To find the Evremond identity.” Inevitably, there’s a temptation to draw comparisons between Taittinger and Evremond, but the team is clear that they are totally separate projects with very different DNA.  Working with English fruit, Ponnavoy felt it was key to manage the potentially biting acidity (and the wine sees full malolactic as a result), but – for him – the greatest challenge was to avoid a bitterness that he finds common in some English wines. Managing the phenolics to avoid this was, for him, therefore essential, while he also focused particularly on the bubble texture – working to get a very fine mousse, something that he believes sets the wine apart from the competition.  In time, Evremond hopes to make 400,000 bottles a year, although there are only 120,000 of its first release. There are plans to add a vintage and rosé cuvée once the vines have matured and they’ve gotten to know the site, but for now they’re only producing the non-vintage Classic Cuvée. Now, a decade after they bought the land, Edition 1 of the Classic Cuvée is set to be released. For a début, it’s an incredible result – perhaps not surprising given the pedigree of the operation. Incredibly fine, taut and layered with oyster-shell, iodine and flint, it’s a wine full of the promise of what Evremond can do.  Domaine Evremond’s Classic Cuvée Edition 1 will be released on Thursday 3rd April: contact your Account Manager to register interest or sign up to be notified here

The skyline of the medieval village of Saint-Emilion is dominated by the spire of its 12th century monolithic church. Hewn from the limestone rock that imbues its wines with their shape and sinew, the 68-metre high belfry surveys the vineyards that cover its plateau and slopes. But it is not the only 12th-century edifice that stands tall among the green carpet of vines: Château Laroque has its own medieval tower, a reminder of its long and somewhat tumultuous past. The latest chapter in Laroque’s history is still being written, but – for wine-lovers – it could be the most exciting yet. Praise has been heaped on Château Laroque recently, with Vinous founder Antonio Galloni even claiming it “may well be the single most-improved wine in Saint-Emilion over the last few years” and that’s due in no small part to its dynamic director, David Suire.  Despite having worked in Saint-Emilion since 2002, Suire is part of the next generation charged with guiding the appellation in the coming decades. Although he only arrived in 2015, he’s already making waves at this historic estate. Happily ensconced at Premier Grand Cru Classé Châteaux Larcis-Ducasse and Beauséjour-Duffau, Suire had not been looking for a new job – but the owners of Laroque, the Beaumartin family, had their eyes on him. He agreed to replace retiring winemaker Bruno Sainson, but on strict conditions: “I knew the estate and its potential, but I would only join if the owners had the ambition to make a wine that reflected the quality of the terroir.”                                                  He requested a soil study of the vineyard, which is no mean feat considering it is the appellation’s biggest estate at a massive 61 hectares (the average holding is a mere eight hectares). “Bruno knew everything about the terroir. He was a very clever man, but my parents’ generation didn’t do analysis of the soil nor in the cellar; it was a question of feeling. I knew I could not wait 10 years to understand everything at Laroque and that’s why I asked for the study,” Suire explained. Armed with the results, there was no sudden change, but with 75% of the vineyards dating back to the 1950s and ’60s, Suire has created a replanting programme that will outlast his working years. The more immediate changes that have had wine critics drooling have come from tweaks in the winery. “I’m working on more precision,” he says. “I was allowed to make my own selection in the blend so it is slightly different. I chose the oldest vines from parts of the plots that best express the limestone.” In an effort to achieve greater elegance and delicacy, pump overs have now been restricted to the early part of the fermentation. The gentle process of plunging – pigeage – is preferred. “For me, the aim of pigeage is to have homogeneity in the ferments rather than extracting tannins. I just want to liberate the cap.” He’s also decided that the top wine will consist solely of free-run juice and no press wine, which tends to be harsher. Suire has also adjusted the estate’s use of maturation vessels depending on the terroir. The lighter texture of wines from the limestone plateau and slopes now spend their adolescence in wooden tanks, foudres and one-year-old Bordeaux barrels, rather than new oak. He explains: “When you have Cabernet on clay, you need a Bordeaux barrel, with Merlot on limestone you need to treat it like a white grape. We don’t need to polish the tannins because we have no press wine and limestone.” The changes are already paying off, with the world’s key critics finding lots to like and higher scores reflecting the upswing in quality, vindicating the Beaumartins’ decision to recruit Suire. Humble yet with undeniable ambition, Jacques Devauges arrived at Domaine des Lambrays in March 2019 and has wasted no time in making small but significant adjustments at the estate. His appointment was the most recent in a flurry of changes that have made waves in the quiet of Burgundy, after the property was purchased by LVMH in 2014 for an undisclosed sum – the luxury group’s first foray into Burgundy.    While the first mention of “Cloux des Lambrays” dates back to 1364, it was really in the 1980s that its modern reputation was established. The vineyard had fallen into disrepair, but was bought by Roland de Chambure and the Saier brothers in 1979. They installed Thierry Brouin as winemaker and director, together restoring the property to its former glory. Thierry, in Devauges’s words, “rejuvenated” the estate – staying at the helm for 38 years, overseeing the property under three different owners before finally retiring in 2017.  Boris Champy had already been lined up to take over, but stayed a mere two years before Devauges was poached from Clos de Tart (where he’d been since 2015, previously Domaine de l’Arlot). In the humdrum of Burgundy, Champy’s sudden departure was big news – as was Devauges’s sudden arrival, although everyone has remained suitably tight-lipped on the topic.  While Domaine des Lambrays does own some village and Premier Cru Morey-Saint-Denis, as well as some Puligny-Montrachet Premier Cru, the domaine’s reputation is inextricably entwined with that of the eponymous Clos des Lambrays. This remarkable site – one of Morey’s five Grands Crus, along with Clos de la Roche, Clos Saint-Denis, Clos de Tart and Bonnes-Mares – was originally classified only as a Premier Cru. It was only in 1981, under Thierry Brouin’s tenure and significant work in the vineyard, that the site was rightfully upgraded – making it the last of Burgundy’s 33 Grands Crus to earn its status.  Such is its association with the domaine that Clos des Lambrays is often mistaken for a monopole; however it isn’t quite. One ouvrée – less than 0.2 of the total 8.84 hectares – at the bottom of the clos belongs to Taupenot-Merme. Originally a vegetable garden, it was planted with vines in 1974, and produces a tiny amount of wine (no more than one barrel in the most generous years).   Visiting in October 2020, it was clear that Jacques Devauges has big plans – and if 2019 is anything to go by, there is much to look forward to. Coincidentally, Devauges wasn’t new to the estate – having worked briefly in the winery under Brouin in 1997. He’s full of praise for Brouin’s work and clearly wishes to respect the enormous legacy he’s been handed. His aim, however, is to recreate the old Domaine des Lambrays of the early 20th century – before the vineyard fell into disrepair in the 1930s.  There have already been a few shifts, with the construction of a new winery underway and 2019 the first fully organic vintage, and the property – as of 2020 – in conversion to biodynamics. This is no small feat given some of the site’s peculiarities. After phylloxera, the vine rows were planted north to south, perpendicular to the slope. This is an angle that little machinery can handle (with a serious risk of toppling over) and as such almost all the work here has to be done by hand, however Devauges has had a special tractor made that can handle the site’s undulating terroir. A relatively large site, it’s unsurprising that the soils here vary. While broadly speaking it is a rocky clay, the bottom of the site is heavier clay and loam, while the midslope is more gravelly over deep limestone, and the very top has shallower limestone soils. As he gets to know the Clos, and differences between each sub-parcel, Devauges is vinifying each one separately, laying the barrels out in the same way as the vineyard – so he can figuratively walk the rows, identifying the character of each. For Clos des Lambrays, he has divided the site into 10 sub-plots (see the map below), however he identifies three major sections of the vineyard: the section near Clos de Tart, the middle and then the side closer to Clos-Saint-Denis.  Tasting three components of the vineyard separately, and then together, with Devauges was enlightening. First up was La Plante Dessous, on the Clos Saint-Denis side, home to some of its “youngest” vines – which are still 40 years in age. The wine produced here is tight and intense, building gradually in the mouth with silky tannins and an amazing purity of blueberry and blackberry fruit. Cerisier, a plot at the bottom of the slope near Clos de Tart, is drastically different. This is full, exotic, rich and ripe – yet with a real freshness and a chalky minerality beneath. The final section we tasted was 80 Ouvrées Dessus – right at the top, middle part of the vineyard. Angular and structured, it showed remarkable energy and intensity – a core of vibrant blue fruit and firm tannins. In the resulting final blend, you can feel every element – except with the dial turned up to max.   Unlike Brouin, Devauges feels it is important not to select the best barrels, and “blend” a wine, but to seek “as much truth as possible”. While he is declassifying the very youngest vines (those under 20 years in age) to their Premier Cru bottling, he feels that they have a responsibility to capture the site in its entirety – using whatever nature provides. “Here, we are farmers,” he says modestly, with a suitably Gallic shrug. The resulting wine is the one true expression of this site – and that’s clearly where Devauges’s focus lies, something that will doubtless evolve in the coming vintages. “Every year is a new page,” Devauges told us. In an era where minimal intervention is so applauded, discussing the art, skill and work of a winemaker can be unfashionable. Producers can seem keen to gloss over or shy away from discussing the tricks of their trade. And tricks there undoubtedly are – as vintages like 2021 prove.  Jean-Antoine Chaptal was a man of many talents. Working in the late 18th and early 19th centuries, he was a scientist and statesman whose interests varied from sugar beets to gunpowder and merino sheep. For wine-lovers, he has been immortalised thanks to his 1801 paper, L’art de faire, de gouverner et de perfectionner les vins – in which he introduced what we now call “chaptalisation”. It was nothing short of revolutionary.   During fermentation, yeast converts sugar into alcohol and carbon dioxide. Chaptal realised that if you added additional sugar to raw grape juice, you could increase the final alcohol content of the wine. The sugar would, along with the natural sugars from the grapes, be fermented, producing a dry, but stronger wine, and – with alcohol a natural preservative – one that would keep better. Suddenly producers could give wines from cooler years a boost (with the alcohol adding much more than just ethanol). Some winemakers, of course, abused the technique – at one point in the early 20th century, the Languedoc reportedly produced twice as much wine as was feasible for the volume of grapes harvested.  Today the practice is strictly controlled by regulatory bodies, only permitted in cooler regions where it is deemed a useful tool, limited according to region and vintage conditions to protect quality. In marginal climates where ripeness isn’t guaranteed, chaptalisation has been the norm. Although you won’t find them in marketing pamphlets or Instagram feeds, bags of Tate & Lyle are widespread in the cellars of Champagne, Burgundy and England, in particular. It’s one reason why climate change has, for many such regions, been a blessing of sorts – the warmer conditions allowing them to more reliably bring in a crop of sufficiently ripe fruit.    Throughout the 19th century in Bordeaux, wines were often blended with those from warmer climes – the finest had a dose of Hermitage (something which Ch. Palmer pays tribute to today with its Historical XIXth Century Wine), while lesser wines had a dollop of something Spanish. Chaptalisation took over in the 20th century, and was widespread – considered part and parcel of making wine in the region.   Global warming and the technology that has revolutionised viticulture and winemaking in the region has changed that, but 2021, with its frost, mildew and generally cool conditions, saw many of northern Europe’s winemakers forced to chaptalise once more – or at least consider it.  Setting off to taste Bordeaux 2021 en primeur, I was braced for the polished spiel of the world’s grandest estates. But perhaps signalling a broader move towards transparency in the industry, what I found was a refreshing frankness. Not a single producer looked to mask the incredible challenges of the year – and the often unspoken reality of making wine in such conditions.  We asked about the potentially contentious topic at every property we visited, receiving only a small handful of slightly wary responses on the topic (“We did what we had to do,” one winemaker said, with a smile). The vast majority of producers felt it was a necessity in the year, although not everyone agreed.  At Ch. Cheval Blanc, Pierre-Olivier Clouet firmly stated, “We never touch the natural balance of the wine.” That said, they did chaptalise three plots in the end, but none of them made it into the Grand Vin. Delphine Kolasa of Margaux’s Marquis d’Alesme believes that you can almost always feel a warmness from the additional, unnatural alcohol – although she noted a few properties who had managed it so well you could barely tell.  At Les Carmes Haut-Brion, Guillaume Pouthier highlighted the balance needed with the year’s acidity levels. The relative lack of sunshine resulted in grapes high in malic acid, meaning that the malolactic fermentation (where hard, green-apple malic acid is converted into softer lactic acid) had a greater impact in the wines, reducing the overall acidity. With this in mind, he felt that chaptalisation could lead to wines feeling “flat” – but it wasn’t a necessity for him, given he managed to reach 13.5% natural alcohol thanks to the property’s warmer, suburban microclimate. These producers weren’t alone – Beychevelle, Léoville-Poyferré and Lafite-Rothschild all opted to work with what nature gave them.  But there were plenty of outstanding estates which felt it was an essential element to success in the year. At Le Pin, Jacques Thienpont remarked how they had to employ “forgotten methods”, noting that it was more than 20 years since he’d had cause to chaptalise in Pomerol. He used it on a couple of vats. Joséphine Duffau-Lagarrosse – the young vigneronne who has taken over her family’s estate – joked about having to learn how to do it, so alien is the process to a millennial winemaker. (“I called Burgundy,” she said, laughing mischievously.)  Similarly, Christian Moueix – another of the Right Bank’s old guard – noted how he used it almost every year in the 1970s, but hadn’t needed to for a long time. For him the key was not to overdo it, enough to add a maximum 1% alcohol. There was a clear consensus on this among proponents – adding half or one degree (of alcohol) was beneficial, but if you pushed things too far, you’d lose balance in the wines. That touch of additional alcohol added body, carried flavour and allowed for more extraction.  At Ch. Canon and Ch. Berliquet, they noted that they always pick on phenolic rather than sugar ripeness, but one of the quirks of 2021 was that the skins ripened before the sugar had accumulated to the expected level. They therefore picked and chaptalised to bring the wine up to 13.5%.  Omri Ram – who produced a particularly exquisite flight of 2021s at Ch. Lafleur – emphasised that he wasn’t anti-chaptalisation, but was anti it being popularised. He used it on a handful of parcels (the most humid plots) where he felt they would benefit from just “a little bit more” – with all the wines ending up between 13.4 and 13.6%. Ch. Margaux was notable for highlighting that, at least for them, chaptalisation wasn’t abnormal. They also used it on a couple of plots in 2017, 2019 and 2020.   There’s no doubt that chaptalisation can be done badly. But tasting through the 2021 vintage in Bordeaux, it’s also clear that it can be done well – used seamlessly to produce wines that are better for that spoonful of sugar. The best wines come from carefully farmed vineyards, sites nurtured to produce expressive fruit, but it takes a talented winemaker to translate that into something you can drink.
