It’s not every day that you get to taste wines made over half a century ago – but earlier this month I got to trace CVNE’s flagship Imperial Gran Reserva all the way back to the 1947 vintage. Victor Urrutia, the fifth generation of his family to take the helm of this legendary Rioja producer, put together a tasting of what he called “the dirty dozen” – lining up 12 vintages of Imperial. The wines were chosen to show how the wine speaks across a range of vintages – not just the most famous, but the hot, the cold, the mighty and the mediocre.  CVNE has been making wine in Rioja Alta since 1879, so – even going back to 1947 – this tasting offered just a snapshot of its history. Imperial was created in the early 20th century (1917 is the earliest vintage Urrutia himself has tasted), conceived as “super Rioja”, Urrutia explained. The idea was to make the best wine possible, regardless of its commercial potential, at a time when Rioja didn’t have the prestige of today. Around 50,000 bottles are produced, but – importantly – Imperial isn’t made in every vintage, with the quality of the fruit in some years not meeting CVNE’s stringent standards (there was no 2003, 2006 or 2013, for example, and there won’t be a 2023 either).  For Urrutia, the goal with Imperial now is to reflect each vintage, and fine-tune the wine rather than look for revolution. The early vintages are their benchmark and inspiration. Across the vintages, however, Urrutia points to a “churchy” nose – something he finds is distinctly Imperial and reminiscent of the winery.  It’s easy, perhaps, to forget how well Rioja ages – and not just over a decade or two, but over half a century. The oldest vintage in this tasting, the 1947, was undoubtedly the star – a wine that has retained its freshness, with delicate aromatics and a beautifully long, pure, resolved palate. The entire flight impressed – with the quality of Imperial shining through. Some of Rioja’s legendary vintages featured (the 1970 and 1959, which sit alongside the likes of 1982 and 1964 in the history books), but my personal favourites were the aforementioned 1947, the still compact 2004 (named Wine Spectator’s Wine of the Year in 2013), the brooding 2011 and pretty, elegant 2018.   The Imperial vineyards  The fruit for Imperial Gran Reserva comes from CVNE’s best vineyards, all over 40 years in age and almost all bush vines, yielding around 4,000kg/ha (equivalent to circa 25hl/ha or less than 1.5 tons/acre). The parcels all sit close to the Cantabrian mountains, at around 500-600 metres’ altitude, and on poor but cool soils (clay and limestone) – lending the wines great freshness, even in hot and dry years, explains longtime Technical Director María Larrea.  The village of Villalba de Rioja has been the backbone of the wine since its conception. This village was where the Real de Asúa brothers (who founded CVNE) first bought vineyards, four kilometres from Haro. The vineyards are steep and south-facing, exposed to the winds and some of the vines therefore have to be trellised (cordón Royat), but it brings acidity and freshness to the wine – something that is essential for its ageing potential. Parcels in the villages of Briones and Torremontalbo were added later, in the 1960s. Briones has richer soils, gentle slopes and a warmer climate, giving structure and body to the wine, while Torremontalbo has steep, stony slopes with calcareous soils and a significant diurnal shift, adding minerality and finesse to the blend.  The Imperial blend  The blend has shifted over the years, with the wine originally around 40% Garnacha and 40% Tempranillo, with the remaining 20% Graciano and Mazuelo. The old vineyards were field blends, with the varieties interplanted and harvested together, meaning mixed ripeness levels – something that arguably brought balance and complexity to the wines, even if some of the fruit wouldn’t have been ripe. Nowadays, each variety is planted separately at CVNE – allowing them more control and precision, harvesting each grape at the perfect moment and crafting a blend in the winery.  There was a move away from Garnacha in the 1970s, with more and more Tempranillo planted instead. Garnacha was less appreciated, seen as a workhorse, an impression that was only reenforced when lesser, high-yielding clones were planted in the 1980s and 1990s. As Larrea also noted, Garnacha is much more prone to coulure and millerandage (poor flowering and fruit-set), which may have been another factor in its decline. There was also a time, Urrutia explained, when Bordeaux was the reference point for fine wine, and they looked to imitate the region, favouring Tempranillo for its darker colour versus the more thin-skinned and therefore pale Grenache. Today, the blend is dominated by Tempranillo (with the 2017 and 2018 Imperial both 85% Tempranillo), but Grenache is undergoing a revival across Rioja and – provided they can have the right clonal material and/or older vineyards – it may contribute more to the blend in time.  The proportion of Graciano and Mazuelo has been reduced slightly, but Larrea emphasises how important the two grapes are in the face of climate change. Mazuelo (aka Carignan/Cariñena) provides structure and colour, while Graciano contributes acidity and aromatic complexity.  The winemaking  Although she joined CVNE in 1991, María Larrea took over the winemaking for Imperial with the 2005 vintage, following on from Basilio Izquierdo, who had been running things for over 30 years (since 1973). Before Izquierdo came Ezequiel García, known as “El Brujo” (“The Wizard”), winemaker for CVNE for over three decades (he returned briefly in 2014 to recreate their legendary white, Monopole).  Across the three winemakers and almost 70 years, surprisingly little has changed. The winemaking here remains extremely traditional, although technology has allowed the team to monitor the wines more closely, and for better winery hygiene, as in most regions. Fermentation remains indigenous, although it’s no longer spontaneous – the wines have been inoculated with a selected strain of their indigenous yeast since the early 2010s (with some experiments in the 1990s). Traditionally fermentation was in concrete tank, however this moved to oak in the 1990s, with one lone vintage (1994) fermented in stainless steel when the vats hadn’t arrived in time.  The wines used to be stored in barrel and only bottled when they were sold, so some older vintages of Imperial spent over a decade in barrel, while today the wine normally stays in barrel for between two and three years. (The bottling dates for each of the vintages is included below – the 1947 wasn’t bottled until 1960!) Originally the oak was all American, simply because that is what they had access to via their historic trade routes, and the barrels were kept for decades (Larrea remembers using 40-year-old barrels when she arrived in the 1990s). CVNE gradually started introducing French oak in the 1980s, with around 30% French oak used in the 1990s and around 60-70% today, with the remainder American.   The wines: tasting eight decades of CVNE Imperial  A note on the bottles themselves: older vintages are in green glass, however they moved to brown glass around 10-15 years ago.  2018 Imperial Gran Reserva: This was a real highlight of the vertical. It is very youthful still, fruit-forward, yet with amazing finesse and delicacy. The nose is precise with dainty aromatics of spice, graphite and florals alongside the crystalline fruit. The palate is juicy and lithe, pure, silken and fresh with savoury tobacco and dried red berries filling the mouth-watering finish. Beautiful and very open, even now. Fermented in oak, 14% alcohol and bottled July 2021.  2017 Imperial Gran Reserva: Frosts swept across much of Europe in late April in 2017, although the rest of the season was relatively warm, producing a tiny crop of concentrated fruit. It’s a drastically different wine to the 2018, yet still with great freshness and a floral lift alongside ripe, sweet red fruit. The palate is tight, much less approachable than the 2018, with compact tannins, a bite of crunchy acidity and a grip of firm tannins, while smoky tones that fill the finish. Decant to enjoy now, but this will be even better with a couple more years in bottle. Fermented in oak, 14% alcohol and bottled July 2020.  2015 Imperial Gran Reserva: The 2015 Imperial is dark and intense, layered with rich bramble fruit, cedar, tobacco, spice and something meaty – a hint of biltong, perhaps. The palate echoes the concentration of the nose, with chewy tannins and a line of acidity that cuts through its intensity. Powerful, almost stern, with more dried fruit coming out with air, the finish is long and savoury, with a touch of red miso. Fermented in oak, 14.5% alcohol and bottled June 2018.  2011 Imperial Gran Reserva: Another standout in the vertical, the 2011 Imperial offers a dark and pure nose, still surprisingly primary with black cherry and cassis fruit, lifted by sweet spicy perfume. The palate is silken and pure, still so youthful, flowing across the tongue, framed by firm but integrated tannins. It’s concentrated and long, with floral aromatics dancing on the juicy finish. Hard to resist with great balance. Fermented in oak, 13.5% alcohol and bottled July 2014.  2009 Imperial Gran Reserva: This is a very serious Imperial now at a lovely stage of maturity – with savoury undergrowth and spicy notes sitting alongside the vibrant dark berry fruit. The palate is intense yet with a softness to it, despite the chewy framework of tannins. It’s juicy and expressive, with smoky, spicy, tobacco notes playing on the finish, and just the slightest hint of leather starting to appear. Fermented in oak, 13.8% alcohol and bottled January 2013.  2004 Imperial Gran Reserva: From “a textbook vintage” in CVNE CEO Victor Urrutia’s words, the 2004 is shining. Pencil shavings and bacon complement ripe, dark fruit. The palate is tight and compact, yet with a juiciness that elongates the whole thing, with acidity that drives through to the long finish. The tannins are supple and soft, integrated with the fruit, but still offer a grip on the finish. Bright and effortlessly balanced. Fermented in oak, 13.8% alcohol and bottled October 2008.  1994 Imperial Gran Reserva: This is an intriguing vintage of Imperial, the only one ever to have been fermented in stainless steel as they were switching from cement to wood, but the new vats didn’t arrive in time for the vintage. It was also served at the wedding of Spain’s Crown Prince, who later became King Felipe VI. After the 2004, this marks a shift towards wines dominated by tertiary notes, although there’s still plenty of fruit here. The nose is spicy with mushroom and undergrowth alongside incense and leathery tones. The palate is laden with umami – with fresh leather and dried berry fruit – as well as dried strawberries, supple tannins and refreshing acidity. Fermented in stainless steel, 13.16% alcohol and bottled June 1998.  1980 Imperial Gran Reserva: As CEO Victor Urrutia said, 1980 was “a shit vintage” – and has always been in the shadow of 1981 and 1982. Tasting the wine today, that’s probably fair – however it’s still an impressive wine. The nose has a distinctly herbal, menthol edge to the sweet fruit – macerated strawberries, with a balsamic hint. The tannins still offer bite, while the fruit shifts to darker, more bramble tones towards the finish. Fermented in concrete, 13.4% alcohol and bottled May 1985.  1970 Imperial Gran Reserva: The 1970 vintage was hot and produced powerful wines – earning it a reputation as one of Rioja’s finest vintages. After over 50 years, the wine is intensely savoury – combining soy, marmite and barnyard tones with intense, dark fruit. With air, the wine offers layers of spice (almost reminiscent of paprika), bacon frazzles and smoked almonds, complementing the concentrated core of fruit. It’s intense yet balanced, with bright acidity that keeps everything fresh and fills the long finish. Fermented in concrete, 12.97% alcohol and bottled March 1975.  1968 Imperial Gran Reserva: From a more difficult vintage, the 1968 Imperial has a charming nose that seamlessly combines savoury and sweet – with earthy richness that sits alongside incense-inflected berry fruit and a pleasing herbal note. The palate is elegant and vibrant, with plenty of fruit still driving through its core, while more savoury, smoky notes dominate the finish. Fermented in concrete, 12.7% alcohol and bottled April 1974.  1959 Imperial Gran Reserva: The 1959 vintage is another of Rioja’s most lauded, although I suspect this bottle was not showing its best. There’s a plushness and intensity to the palate, with a sharp drive of acidity, while the nose is dominated by leather, black liquorice and barnyard. Fermented in concrete, 13% alcohol and bottled February 1968.  1947 Imperial Gran Reserva: An amazing wine to tasted, the 1947 CVNE Imperial has a reputation – one that this bottle more than lived up to. Coffee and tobacco notes with bright fruit – ripe red cherry and raspberry, as well as florals, incense, black tea and sage, alongside smoky perfume. It’s long and fresh on the palate, seamless and fully resolved but pure and persistent, with a Bovril edge to the finish which is vibrant and long. Gorgeous now – drink it while you have the chance. Tasting CVNE’s Imperial Gran Reserva Rioja 2018-1947 

An icon through the ages: CVNE’s Imperial Gran Reserva 

I first sat down with winemaker Chris Phelps almost two years ago, diving into his remarkable journey. Having worked at the likes of Dominus, Caymus and Inglenook, it was chance – or maybe fate – that led him to establish his own wine label, Ad Vivum, in 2007.  He was sitting above a tank of just-fermenting fruit when he was struck by a “coup de foudre” – falling instantly for Sleeping Lady Vineyard, a site farmed by his good friend Larry Bettinelli. He bought the half-fermented must, and has continued to do so every vintage since.  The specific blocks that filled that tank sat up against the Mayacamas at the very top of the vineyard, which is the southernmost site in Yountville. Here, the vines are shielded from the blaze of the afternoon sun, preserving acidity and aromatics in the fruit, while a flow of underground water allows the site to thrive in even the driest of years. Each year, from just 1.5 acres of Cabernet Sauvignon, Phelps crafts another expression of the site.  The exact parcels have shifted very slightly over time. In 2007, the vines were all Clone 191 – the clone he felt was best on the site, but the block needed replanting so they started using fruit from an adjacent plot, planted with Clone 7. After a “carefully thought-out dance” balancing the two plots, the 2024 vintage marks a return to using fruit only from the original plot, now replanted with Clone 191 (and known as Clone 34, which is genetically identical to 191).  Phelps left his day job (working for other wineries) at the end of 2023, finally able to focus exclusively on Ad Vivum, as well as a newer project with his son Josh (Coil Wines). Although we’d tasted the current releases before, earlier this month we were able to taste a trio of back-vintages for the first time. They reinforced how special this site is, as well as Phelps’s talent when it comes to capturing it in bottle.  The three vintages we tasted were 2016, 2017 and 2018 – three very different years in Napa. All three, however, manage to combine great freshness with Napa polish – creating wines that are surprisingly approachable already.  2016 Ad Vivum  In Phelps’s words, 2016 was “a classic Napa vintage”; the weather was warm at the end of June, allowing the vines to focus on fruit ripening, while autumn brought cooler weather. Phelps harvested from 7th October, fermenting in 21% new French oak (the rest in stainless steel), with a total of 19 days on skins prior to maturation for 18 months in 65% new French oak. It has always had “a seamlessness”, Phelps noted, and that’s certainly true tasting the wine.  The nose offers sweet, dark fruit, graphite purity and hints of lifted florals as well as an herbaceous edge. The palate is linear and pure, with mouthwatering acidity and a savoury core of ripe fruit, sweet cassis and ripe tannins that provide a drying grip on the finish. Although the oldest of this mini-vertical, it almost feels the youngest and will certainly benefit from additional time in bottle. A blend of 56% Clone 7 and 44% Clone 191 Cabernet Sauvignon.   2017 Ad Vivum  The 2017 vintage is one that will forever be remembered for its wildfires in Napa, although fortunately Ad Vivum wasn’t impacted by them. After an early budbreak, the growing season was marked by three heatwaves – in mid-June, at the end of August and in mid-September. Having a cooler site, shaded from afternoon sun and with sufficient water reserves was key for Phelps. He harvested from 5th October, bringing in 55% Clone 191 and 45% Clone 7 Cabernet. It was fermented in 25% new French oak, spending 20 days on skins in total (Phelps noted how easily colour and tannin came in this hot vintage), before being aged 17 months in 70% new French oak.  The nose here is bright and perfumed, combining sweet dark fruit – black cherries and blackcurrant – with floral lift and pencil lead. There’s a glorious purity to the fruit here, which follows through onto the dense yet fresh palate, displaying a juicy elegance. There’s a satisfying chew to the tannins, firm yet velvet-like, framing the waves of fruit that flow towards to the long, saline finish. Mouthwatering and moreish, this is hard to resist now.  2018 Ad Vivum  Although the 2018 vintage in Napa started with relatively late budbreak, cooler, even temperatures made for a long growing season, and producing relatively plentiful yields – yet without any dilution, thanks to the extended season. Phelps harvested from 17th October, with the blend moving back towards around two thirds Clone 191 Cabernet from the original block and a third Clone 7. Fermented in 25% new French oak, Phelps left the 2018 on skins for 23 days – slightly longer than other vintages, feeling structured fruit needed more time to reach its potential, echoed with its maturation in 75% new oak for 20 months. Phelps notes how generous this wine has been from the beginning, but has developed further opulence and depth in bottle.  This is a beautiful wine: the nose is intense, exuberant with dark fruit and a satisfying herbaceous edge. Although the blackcurrant and black plum fruit is beautifully ripe and smooth, there’s bright acidity that brings gorgeous freshness – making for a lithe and vibrant palate. Wine journalists are jaded folk – spoilt by too many impressive tastings, lunches and dinners. But when Champagne Louis Roederer invites you to an event celebrating 50 years of Cristal Rosé, few refuse. Cristal Rosé is, as Chef de Cave Jean-Baptiste Lécaillon told us, still “a hidden gem” and the rarest cuvée Roederer produces. It’s not often shown, and even visitors to the estate don’t get to taste the wine.  While Cristal – Champagne’s first prestige cuvée – was created in 1876, its pink sibling was born almost a century later. It was Jean-Claude Rouzaud, current CEO Frédéric Rouzaud’s father, who created the wine, aged 32. He had been managing the company’s vineyards and took over the winemaking in 1974.  “His great vision was to put the vines back in the centre of the creative process,” explains seventh-generation Frédéric Rouzaud. For Roederer, site and farming have long been key to what they do (long operating both as a grower and négociant), but Jean-Claude’s move from vineyard to cellar pushed this further, allowing for – as Lécaillon put it – “a creative and constant dialogue between the vineyard and cellar”.  The same year that he started leading the cellar team, Jean-Claude decided to make a rosé version of Cristal. Almost all rosé Champagne was – and is – made by blending a still red wine in with the base white wines. Jean-Claude, however, wanted to use co-fermentation to keep the wine in the style of Cristal, a decision that Lécaillon says was key, making the wine more ethereal, precise and “Pinot-y”, with a juicier texture.  The wine was built around parcels of Pinot Noir in the Bonottes area of Aÿ, which Lécaillon describes as the “Musigny” of Champagne. In his mind, the Pinot Noir from these plots offers a “special tannic complexity” – tannins that are more saline, integrated and aromatic; the Pinot Noir here is, he says, “effortlessly perfect” and the heart of Cristal Rosé. These three vineyards (Bonotte Pierre Robert, Gargeotte and Côte du Moulin) had been used for Cristal since the 1870s, and more recently became the source for Pinot Noir material for their vine nursery – with 150 different massal selections taken from the plots – long recognised for their quality.  The three original Pinot Noir plots are now being replanted and – while the vines mature – another site in Aÿ, La Villers, a mid-slope parcel at higher altitude, is currently being used in the blend (from the 2018 vintage). It is set to form part of the wine long-term, its cooler position thought to be of particular benefit with climate change. Complementing the 55% Pinot Noir is Chardonnay from two sites – Pierre Vaudon in Avize (bringing more power and richness) and Montmartin in Le Mesnil (lending length, salinity and a chalky minerality).  The first two vintages (1974 and 1975) were more experimental, as Jean-Claude figured the wine and style out, but the third attempt in 1976 produced something special – with sufficient phenolic ripeness to produce a rosé truly worthy of the Cristal name. Even now, 48 years later, that wine is singing – combining savoury rye and brown miso notes with pear tarte tatin and an earthy power. While it had a flurry of three vintages at the start of its life, just 25 vintages of Cristal Rosé have been produced to date. The wine needs a year where not only the quality of fruit is outstanding, but the Pinot Noir and Chardonnay ripen at the same time – allowing for their co-fermentation – something that is relatively rare.  Only made with vines that are minimum 20 years old, yields are low for Champagne (at 35-40hl/ha).  The Pinot Noir is destemmed, crushed and left to macerate. Earlier vintages saw this happen over two to four days and at warmer temperatures, but the winemaking has evolved over the years, with a pivotal shift from the 2008 vintage. From 2008. Lécaillon started chilling the Pinot Noir down to -4̊C overnight, prior to de-stemming and crushing the fruit – something which he believes avoids extracting any green character.   The must is then left to cold-soak for between seven and 10 days, with no punch-downs or pump-overs – a true “infusion” (to avoid any microbial spoilage, they cover it with dry ice for the first four days, then use nitrogen). The must isn’t chilled during this time, and the temperature gradually rises to a maximum 8-9̊C. Moving to a cold-soak was inspired by an accident. In the warm 1989 vintage, Lécaillon’s first year at Roederer, they didn’t have a cooling system in the cellar, and the Pinot Noir was left in a reefer – undergoing an inadvertent cold-soak. The resulting wine was so good that it inspired Lécaillon.  Just as the fermentation starts, the must is racked off and blended with the Chardonnay which has been whole-bunch pressed pneumatically (Lécaillon argues the grape’s reductive nature needs a little skin contact to avoid being overly thiol-driven and Sauvignon-esque). Around 20% of the base wine sees oak. After secondary fermentation (under crown cap, something with Lécaillon argues helps preserve precision and terroir versus cork), the wine spends eight years on its lees, developing immense complexity.  “Since 1974, it has been our laboratory of farming, of winemaking,” says Jean-Baptise Lécaillon of the wine. Cristal Rosé was in fact the House’s first cuvée to be farmed biodynamically, and the first biodynamic prestige cuvée in Champagne, from the 2007 vintage. He explains that he is looking for phenolic ripeness, integrated with the salinity of Champagne, seamlessly combining the tannins and acidity; a wine complemented – but not dominated – by bubbles of salt.  The wine is undeniably remarkable. Tasting through a range of vintages from 1976 to the present day, all in magnum (find full tasting notes below), the vibrancy, purity and moreish, saline, minerality of these wines left me speechless. Their ability to age is effortless, with the 1989, for example, still tasting incredibly youthful. Talking about Cristal Rosé’s evolution, Lécaillon explains that he finds the first decade is all about fruit, but then the wines return to their site and soil, becoming wines of place. Conversation strays into weather Champagne today, with global warming, can still make wines that will age as beautifully.  “Champagne is not just about acid; it’s about freshness,” says Lécaillon. He points to the 1976 and 1989 vintages – both incredibly hot years, with the fruit picked at almost 12% potential alcohol and modest acidity levels – and yet the wines are full of freshness. Back then, producers were on holiday throughout August, and the fruit was picked in September (1st for the 1976 and from 5th for the 1989), but with such conditions today they would have harvested in mid-August. It is perhaps, he suggests, a lesson that the region is overreacting to warm conditions – with too many producers chasing acidity, rather than phenolic ripeness. For the skins are, he argues, the key to this sense of freshness, the dry extract that allows the wine to age.   The House has introduced a Cristal Rosé Vinothèque, or late release. To date, there have only been a handful of vintages – the 1995, 1996, 1999 and 2002. The maturation for this wine isn’t set and varies according to the vintage, normally spending longer on its lees, both sur latte (lying down) and sur pointe (upside down), the idea being to build umami complexity in the wine. The sur pointe ageing is unusual, something Lécaillon favours for its more reductive nature, keeping the wine aromatically fresh (the wine is still riddled four times a year in the same position, to agitate the lees and absorb any oxygen). Generally these releases are offered around 15-17 years after the vintage. The dosage is often lower than the original bottling, with the longer lees ageing lending balance without a higher sugar addition. Tasting the 2002 Vinothèque (a wine that feels infantile), Lécaillon says: “Is it better? I don’t know, but it’s another expression.”  I’ve written before about Lécaillon’s tireless approach to wine-growing – constantly looking to learn and evolve, and the week after our dive into Cristal Rosé he was flying to Japan to visit the Fukuoka farm (founded by Masanobu Fukuoka, the author of The One-Straw Revolution and a pioneer of permaculture or “natural” farming). His fight against the “banalisation” of taste continues, as he looks for ever-more ways to enrich the world of Louis Roederer. If the next 50 years of Cristal Rosé is nearly as good as the first, we’ve all got a lot to look forward to.  Five decades of Cristal Rosé: the tasting  2013 Cristal Rosé: A beautiful, late-ripening growing season that provided the last October harvest to date. A wine Chef de Cave Jean-Baptise Lécaillon describes as having “eternal youth” – something that is hard to disagree with after tasting the wine. This is a baby, the nose enticing with delicate floral aromas and bright citrus, not giving too much away. The palate is long and saline, tightly wound, but bursting with bright fruit on the mouthwatering finish, combining lush redcurrant and lemon. Gorgeous. Dosage 7g/l, tasted from magnum.  2012 Cristal Rosé: Lécaillon notes how 2012 was seen as an “easy” vintage on release, riper and richer with a little more Pinot Noir in the blend, but is now entering its second life, with reductive, chalky notes that bring it back to its soils. The wine is beautifully earthy and drastically different to the 2013, with power and intensity. It’s very savoury, a wine that is all about breadth and structure, with wild strawberry and raspberry notes mingling alongside a sea-spray freshness, driving on to a long, mineral finish. Dosage 8g/l, tasted from magnum.  2008 Cristal Rosé: This was the first fully organic vintage for the entire Roederer estate, and marks the start of a new era for Cristal Rosé with its cool “infusion” technique for the Pinot Noir. Paired with the 1995 vintage, the two wines are windows into two completely different worlds of Cristal. With the copper tone of a sunset, it’s a wine of muscle. It’s almost haughty, with length, power and elegance – showing off its flawless structure, with a zesty citrus drive complementing its austerity. The finish is long and saline. It will be incredible to taste this in 20 years’ time. Dosage 8g/l, tasted from magnum.  1995 Cristal Rosé: This vintage was one of the last to see the Pinot Noir soaked at 20-24̊C. It is, in Lécaillon’s mind, the “same terroir, but a different story” versus more modern iterations of the wine. The wine glows golden in the glass – the colour of the sun just as it breaks the horizon. It’s incredibly open, the aromatics constantly shifting to reveal new layers. There’s a touch of mushroom or truffle, but with layers of rich, almost tropical, fruit behind – think peach, mango, peach tea and the bite of pomegranate, with caramel sweetness, but still a saline twist to the finish. A wine of weight and depth. Dosage 12g/l, tasted from magnum.  1989 Cristal Rosé: This was a very warm vintage, harvested from 5th September, and the wine technically doesn’t have high acidity – yet is a wine of impressive freshness. Grilled hazelnuts edge a nose of candied orange peel and pomegranate, and a coffee note that emerges with air. There’s a liveliness to the palate here, even over three decades on, with a gorgeous freshness and creaminess to the mousse. The fruit on the palate is lush, with generous mouth-watering peach and a taut, mineral backbone. It’s amazing how young this tastes still. Dosage 12g/l, tasted from magnum.  1976 Cristal Rosé: Despite coming from another warm vintage (with a very hot, dry August – and harvested from 1st September), Jean-Baptiste Lécaillon notes the freshness on the 1976 vintage, and how it seems to have never become too evolved. It’s much more savoury than the 1976, with rye bread and brown miso sitting alongside caramelised pears, tarte tatin and a hint of Oloroso Sherry. The palate is a rush of fine bubbles, fresh and with a citrus bite but a savoury framework behind. A remarkable wine. Dosage 10g/l, tasted from magnum.  2002 Cristal Rosé Vinothèque: This was disgorged in 2019, spending 11 years on lees sur latte, and then another five sur pointe, followed by an additional four years’ post-disgorgement ageing prior to release. This wine is so tightly coiled, a wine not yet revealing everything it has to offer – although you can see the incredible structure. It’s so vibrant, with energy and a lushness as it drives toward a seemingly never-ending finish. It’s gorgeous, layered with mandarin, grapefruit pith, chalky minerality and smoked salt, lingering on the soft, saline tail of the mouthwatering finish. This year marks the 50th birthday of Cristal Rosé, Champagne Louis Roederer’s rarest wine. Sophie Thorpe caught up with CEO Frédéric Rouzaud and Chef de Cave Jean-Baptiste Lécaillon about this very special prestige cuvée and tastes through five decades of the wine

This year sees the release of the 20th vintage of Cheval des Andes – Cheval Blanc’s operation in Mendoza. Since the team from the legendary Saint-Emilion estate embarked on the venture with Terrazas de los Andes, 25 years ago, much has changed – and this is the start of a new era for the property. What was once a working concept has taken root.  “This is the beginning of our adult life,” says Technical Director Pierre-Olivier Clouet. “We have a real identity today.” It’s taken a quarter-century for the property to shake off the uncertainty of youth and find firm footing – something that hasn’t necessarily been easy.  “We made mistakes,” Clouet confesses. Not having a historic reputation to rely on, the team at Cheval des Andes had sought out high scores, chasing points to prove their worth. But, in a still Parker-dominant era, that meant making wines with “ripe grapes, a lot of extraction, a high level of alcohol – you [had] to show the muscle to explain that you are a great wine”, explains Clouet. “For a long time, the recipe was in the cellar; nobody cared where the vines were.” Now, however, that’s all changed.  From 2011, the team started shifting focus to the vineyard, working more closely with their French counterparts and vice-versa. The arrival of Lorenzo Pasquini (now the man at the helm of Ch. d’Yquem) in 2015 was key to the transition, as Cheval des Andes started to focus on a shared vision of fine wine – one that is about freshness, balance and ageing potential, and one that defines Cheval Blanc.  Only with a few wrong turns, however, can you be sure you’re on the right path – and Clouet is clear that those first 16 years, figuring out what Cheval des Andes should and could be, has been “super important” in helping them build “something with real sincerity, real authenticity”. Most importantly, Cheval des Andes is not intended to be, nor is a copy of Cheval Blanc: “It is, in our mind, absolutely an Argentine wine,” says Clouet.  The original 31-hectare vineyard is in Las Compuertas in Luján de Cuyo, a subregion of Mendoza. It is on these clay-dominant soils at around 1,000 metres’ altitude that Pierre Lurton discovered a plot of ungrafted Malbec in 1998. Planted in 1929, the vine material pre-dates phylloxera, descended from a selection imported to Argentina in 1852 – back when the grape dominated Bordeaux. This selection is key to the DNA of Cheval des Andes and, along with the huge diurnal shift, produces Malbec that is fresh, precise, perfumed and delicately structured. For Clouet, the “true” Malbec is closer to Pinot Noir in style – more floral than fruit-led, vibrant and even ethereal.  In 2001, the team purchased an additional parcel in La Consulta in the Uco Valley, at higher altitude and with more gravel-driven soils, a cooler site that has an even more significant diurnal swing in temperature. While they once might have used only a fraction of the estate to produce the flagship wine, they have moved to using as much as they can – to create a pure expression of the entire property, declassifying only plots that don’t fit in the blend or meet their stringent quality standards.  All 50 hectares are farmed with the same philosophy as their vines in Saint-Emilion – employing extensive cover crops, trees scattered throughout the vineyard, and with the same incredible attention to detail and focus on sustainability. “We work with the same vision and the same conviction,” says Clouet. One key difference, of course, is that irrigation is essential in this part of Argentina – but, here again, they’ve changed tack over the last decade or so. Rather than traditional modern drip irrigation where necessary water would be eked out drop by drop over the season as needed (“too artificial”, Clouet tells me), they irrigate extensively over the winter to ensure the soils are replenished fully between seasons (as well as help protect ungrafted vines against phylloxera), then – on a plot by plot basis – when the vines are starting to suffer, they give the vines around 40mm of water (still via drip irrigation), over 24-48 hours, replicating a day or two of steady rainfall.  They’ve reduced the height of the canopy (the engine of the vine for sugar production), while using trees, cover crops and minimal leaf-pulling to avoid sunburn. They’ve started pruning each vine according to its vigour, and are now picking significantly earlier – as much as two months earlier than 15 years ago. With this detail in the vineyard, the challenge is simply to guide the fruit through the winery: “No mistakes is enough in the cellar,” says Clouet.  In some ways, the wine echoes Cheval Blanc. While the Saint-Emilion property blends Cabernet Franc and Merlot, Cheval des Andes focuses on Malbec and Cabernet Sauvignon – the Malbec bringing freshness and silkiness that complements the backbone of powerful Cabernet. And the Cheval Blanc style, one of restraint and precision, shines through in recent vintages of the wine – and especially the soon-to-be-released 2021. As Clouet tells me, “Our vision is absolutely delicacy, freshness, balance, ageing potential, complexity.” Unlike Cheval Blanc, however, which needs 10 years in bottle to start even hinting at its potential, Cheval des Andes offers an immediacy – something that Clouet is clear doesn’t inhibit its ability to last; the 2021, for example, can be drunk now, but will evolve over the next 25 years at least, he tells me.  Even the association with the Cheval Blanc name doesn’t make Cheval des Andes an easy sell to fine wine lovers; but that, says Clouet, is part of what makes it fun – a challenge for the team to be pushed. Even better, his team gets the chance to learn and make wine not just once a year, but twice, as well as gaining additional insight on how Cheval Blanc might adapt to climate change. But Cheval des Andes isn’t just an intellectual exercise (that is merely an added bonus), Clouet firmly believes in the potential of this site – something they’re now finally beginning to realise. 2018 Ch. Mauvesin Barton (in jeroboam) + Champagne Elise Bougy, Le Mesnil – chosen by Damien Barton-Sartorius  “To me, a meal is always about a moment. Sometimes very important ones such as announcing a baby, sometimes it’s more casual as would be a meetup with friends. I like to think that the bottle should never be more important than the moment. It should not frustrate the generous person who wanted to share a special bottle that becomes overlooked – or even worse steals the show... Unless it is the show! The special bottle then becomes a moment of its own. It is an interesting thing (and sometimes fun!) to taste great labels blind, judge them on their value/pleasure. But it tears away what wine should be: excitement. If I am going to drink a Mouton Rothschild 1945, I honestly don’t really care if it’s good or not. It’s a piece of history in a bottle that I will be sharing with friends and I would really like to know this ahead of time so I can be excited about it for as long as possible. Just like planning holidays ahead!  “Christmas is an important moment but the moment is family, not the wine that will be put on the table. I want a wine that will trigger some chat. Briefly – before enjoying the wine as a lovely drink, fuel of diverse conversations. There should be enough of it to spend some time with it. Aim for large format. We all know that even a magnum can be short…  “To be very personal here, I just got married and I will spend my first Christmas Eve with my wife’s family. A bit of home, some volume to enjoy and share: Ch. Mauvesin Barton 2018 in jeroboam is my choice for dinner. Oh but what would Christmas be without Champagne… a sneaky bottle to share only with my wife before the dinner: Elise Bougy Le Mesnil. Now I am excited for Christmas!”  Damien Barton-Sartorius is the 10th generation of his family to run the Bartons’ Saint-Julien Classed Growth estates (Ch. Langoa Barton and Ch. Léoville Barton), while his sister Mélanie is at the helm of Ch. Mauvesin Barton, together continuing their grandfather Anthony’s and mother Lilian’s legacy. 2010 Ch. Latour, Pauillac – chosen by Jonathan Maltus  “We’re drinking Ch. Latour 2010. There are 10 of us – all family – two grandparents, four parents and the rest kids. As a family we don’t enjoy turkey so we have beef Wellington – which I’m hoping this will go well with.” Jonathan Maltus is the man behind the Saint-Emilion property Le Dôme, one of Bordeaux’s original garagistes. 2001 Richebourg, Grand Cru. Domaine Hudelot-Noëllat – chosen by Charles van Canneyt “For dinner, a Richebourg 2001. Perfect to drink now and taking full advantage of the complexity and power of a Richebourg – with a good capon! We had Suchots 2017 – all about the fruit – when we put up the tree, a vintage that’s approachable young and very enjoyable!”  Charles van Canneyt is one of Burgundy’s most talented winemakers. The young vigneron is at the helm of Domaine Hudelot-Noëllat, based in Chambolle-Musigny, and also has a négociant label under his own name.  2015 Ch. Haut-Bailly + 2019 Meursault, Les Vireuils, Domaine Roulot – chosen by Véronique Sanders “It’s so very difficult to choose just one bottle… while many people start their celebration with Champagne I always love to start (and finish) with a glass of Sauternes or Barsac. Right now I am loving Ch. Haut-Bailly 2015 which is so charming and is pure pleasure! Of course I also love wines outside of Bordeaux – white Burgundy being my weakness… I have my eye on a bottle of Domaine Roulot Meursault Les Vireuils to share with the family this year.”  Véronique Sanders is the powerhouse at the helm of Ch. Haut-Bailly, the leading Pessac-Léognan estate.  2018 Paul Cluver Estate Chardonnay, Elgin, South Africa – chosen by Spencer Fondaumiere  “I grew up in Nairobi at a time when the wine scene was not nearly as advanced as it is now. My mother enjoyed her wine. My dad was a beer man through and through. What was regularly available was wine sold in five-litre boxes labelled as ‘late harvest’, with just enough sweetness to interest you to get to the bottom of the bottle – or more accurately the last dredges of the cask. I have now lived in Cape Town for the last 11 years and my wine appreciation has grown a little bit beyond the voluminous late harvest on tap.  “Christmas is a time for family and my mom and dad will be spending the holidays with me and my family. Since I last saw her, Mom has developed an appreciation for cool-climate Chardonnay and I am quite keen to crack open this bottle that has a bit of age on it. I am hoping it will be like nothing she has ever tasted before and I am hoping even more that she will like it. Dad, on the other hand, remains partial to beer, but every Christmas I optimistically open a bottle and hope that this will be the wine that converts him into a wine lover. That being said, there is not too much 2018 Chardonnay hanging about so it may not be the worst thing if this doesn't turn out to be the one.”  Spencer Fondaumiere is one of the most exciting names on Africa’s wine scene. The Kenyan chef-turned-sommelier and serial entrepreneur is now Chairman of the South African Sommelier Association and has two businesses – using his expertise to advise wine-drinkers, restaurants and producers via Slowgold and Wineyard East Africa. A trio of Bouchard’s best – chosen by Frédéric Weber  “For Christmas with my family, I have planned a 2016 Meursault Genevrières to accompany the foie gras that my sister makes herself every year. I like the combination because our Genevrières has just the right freshness and delicacy, especially in 2016, to awaken the tastes and accompany the sweetness of foie gras seasoned with a touch of Sichuan pepper and a hint of fleur de sel, a great match! With the duck, of course a Beaune Grèves Vigne de l’Enfant Jésus 2003. Two-thousand-and-three was my first vintage in the house [at Bouchard], 20 years ago already, great memory of this harvest and Baby Jesus is a nice wink for Christmas Eve! And then a Corton 2013, my mum loves Le Corton and we don't refuse her anything.”  Frédéric Weber is the detail-oriented Head Winemaker at Bouchard, one of Burgundy’s leading, quality-focused producers and négociants. He has been at the company since 2002, taking over fully from his predecessor Philippe Prost from the 2014 vintage.  Champagne Corbon, Brut d'Autrefois, Avize (and a couple of back-up bottles) – chosen by Chris Gaither MS  “Christmas is always a special time of the year for my family. My wife, Rebecca (also a Master Sommelier), who is Jewish, always looks forward to the combo of Hanukkah and Christmas celebrations back-to-back, especially with our young daughters. We tend to favour multiple evenings of delicious food and drink that we can enjoy, albeit with moderation. And she and I rarely finish a bottle when drinking together at dinner, if it's only the two of us sipping. Surprised? It’s partially because we have two kids and run two businesses (Ungrafted and GluGlu), so work doesn’t stop even after dinner! So, on Christmas evening we'll be having a low-key 'Jewish' Christmas dinner, with a few other Jewish families. We are going to order Chinese food from one of our favourite restaurants in Millbrae (Wonderful is the name if you'd like to know), and chow down on some tasty dishes with a few of our favourite bottlings from producers we admire.  “Rebecca and I are huge fans of Champagne, and most times if you ever see us sipping on something together, it's usually just that. Champagne Corbon is a tiny grower based in the Vallée de la Marne (run by Agnès Corbon – ladies rule!), but they sell a good portion of their fruit from their vineyards there. They own two hectares of vineyards in Avize, of which they use to produce most of their wines. The Brut d'Autrefois is based on a 35-plus-year-old perpetual reserve (or solera) that is roughly based on 90% Chardonnay and 10% Pinot Noir. The solera consists of a single neutral oak vat that is 50% drained each year for bottlings of D'Autrefois, and then refreshed with a new year's vintage. Delicious, exuding a bit of richness, with nice texture, and loads of complexity. We were fortunate enough to get a few bottles of these, and I think we'll be drinking the last one we have... for now... The other bottles are ‘just in case’ bottles that we love.  “2018 Domaine Weinbach, Riesling Schlossberg, Grand Cru, Alsace: Who doesn't like Riesling? Any sommelier with street cred will tell you to drink more Riesling – it's routinely underappreciated in the world of wine, and you can get fantastic examples that are made with the same care as Grand Cru wines in other regions, but at less than half the price. Weinbach is one of our favourite domaines within Alsace, and it is currently run by Catherine Faller (again, shoutout to all the ladies making the magic happen in wine!) and her sons, Eddy and Theo. This Riesling is coming from their holdings in Schlossberg, the first Grand Cru to be ratified in Alsace in 1975. The wine almost always has a deftly balanced touch of botrytis, with lovely bruised apple and peach, with a very noticeable meyer lemon twang on the finish.   “2011 Fixin, Premier Cru, Clos de la Perrière, Domaine Joliet Père & Fils: This particular vineyard is a monopole within the village of Fixin, and this bottling is 100% Pinot Noir. It is run by Bénigne Joliet, who purchased the vineyard from his other family members in 2004, with the goal of making the Clos de la Perrière one of the more famous vineyards in the Côte de Nuits in Burgundy. Rebecca had the opportunity to visit the estate and meet Bénigne back in 2014 on a visit. She purchased the bottle of 2011 Clos de la Perrière on this trip. I’m super excited to drink it with her! She’s great at putting bottles away and not touching them!”  Chris Gaither MS was born in Atlanta and started working in hospitality to help pay the bills while at college. He gradually fell into the wine side, becoming hooked and – after a stage at The French Laundry in 2008 – launched into San Francisco’s wine scene, working at top restaurants and earning various awards. He became the fourth black person to pass the Master Sommelier exam when he passed in 2022. Married to a fellow Master Sommelier, Rebecca Fineman, together they own and run two restaurant/wine bars, Ungrafted and Glu Glu, in San Francisco. 2003 Chinon, Les Roches, Domaine Alain & Jérôme Lenoir – chosen by Ivan Massonat  “Of the (many) bottles I intend to open, one is high on my expectation scale: a 2003 Chinon from Domaine Lenoir. It’s a bare bottle, without any label nor cap, that I bought from Jérôme [Lenoir] a couple of years ago, after a few hours of tasting down in his ‘cellar of wonders’. After tasting several decades, 2003 had struck me as super fresh and elegant, like magically untouched by the famous 2003 summer heatwave in France. I would like to open it for New Year’s Eve, with one my best friends from high school who’s also a wine lover – and not a label drinker!” Ivan Massonat is the ex-financier that created Domaine Belargus, the Anjou estate that has fast become one of the Loire’s most famous, shining a light on its varied terroir through a single grape – Chenin Blanc. Stellar Spanish and South American bottles – chosen by Carlos de Carlos  “This year we have some cousins from the USA that will come home for Christmas evening and dinner. As they come to try some good South American wines, I will drive them around some of my all-time favourites for dinner. So the selection will be: Baettig Los Primos Chardonnay 2021 for the aperitivo. A wine that shows the very best of the south of Chile with a finesse and minerality that I love. Then Viña Cobos Chanares Malbec 2018 – one of my favourite wines in Argentina coming from Los Arboles in Tunuyán, Valle de Uco. Really special vintage from a really unique vineyard! And the grand finale will be Vega Sicilia Unico Reserva Especial 2008-2009-2010 [the 2020 release] – not only because the wine itself, but also because it was a very special present for my birthday that a very close friend gave me… and will be tasted alongside my favourite dish, Spanish paella.” The charming Carlos de Carlos is one of the founders of Baettig, along with winemaker Francisco Baettig, a Chilean producer that is one of our favourites. A flight of Champagne, Burgundy and Bordeaux – chosen by Blandine de Brier Manoncourt  “This Christmas my family will begin with a fabulous Champagne, Laurent Perrier’s Grand Siècle Itération No. 26, which we will enjoy as an apéritif around the tree. At the table, our dinner will begin with Corton-Charlemagne from our dear friend Stéphane Follin-Arbelet, the 2008 vintage, which will pair perfectly with a lobster dish. Next is, of course, Figeac! First the 2010 vintage of Ch. Figeac – it is magnificent right now, and goes very well with truffled capon. Finally we will enjoy our favourite vintage of Ch. Figeac, the 1990. We wish everyone a very happy Christmas and a wonderful New Year!”  Blandine de Brier Manoncourt is daughter of the iconic Thierry Manoncourt who established Figeac’s modern reputation. Having studied at Sciences Po Bordeaux, she is Co-owner and General Secretary, especially involved in managing the property’s heritage.  2001 Ch. Figeac – chosen by Frédéric Faye  “My family is very excited this year to serve one of my favourite vintages of Ch. Figeac at our Christmas dinner, the 2001. This is a vintage in its full maturity, a vintage which sadly is often overlooked by wine-lovers but is in fact one of the great references of the property. Fresh, elegant, with a beautiful concentration… it will pair perfectly with ris de veau in a sauce à la morille. Wishing a happy Christmas and New Year to you and your families!”  Frédéric Faye is Managing Director of Ch. Figeac, where he has been working for over two decades, having arrived as an intern in 2002. Blanquette de Limoux, Antech, Brut Nature – chosen by Christina Stanley  “I share a holiday tradition of sipping bubbles with my mum while cooking, before any guests or family arrive. My dad suffered a stroke back in 2014, and she is his caretaker. Last year, when she tasted Varnier-Fannière Blanc de Blancs, she said, “This tastes like every good time I have ever had,” but Champagne is not what we drink while cooking. You know what’s great with a splash of orange juice? Antech Blanquette de Limoux Brut Nature. It has delightfully bright, lemony acidity, an abundance of chalky minerality, and it’s inexpensive. The main grape is Mauzac, locally known as ‘Blanquette’. Wonderful as a versatile aperitif and perfect as a Mimosa base, Blanquette de Limoux plays a starring role in any holiday gathering.”  Christina Stanley is an Advanced Sommelier and the Wine Director at The Slanted Door Napa – an outpost of Charles Phan’s group of legendary restaurants that are a reference point for fine dining and modern Vietnamese food. 2008 Merlot, Miani, Colli Orientali del Friuli – chosen by Michele Dal Forno  “I think I would pick a Merlot from Miani. Enzo, the owner, is truly the ‘last of Mohicans’ of vignerons in Italy, as he is seriously devoted to his vines and the wines he makes are a pure expression of each varietal he grows. I was lucky enough to taste many of his wines last summer with himself and some other friends and I was shocked by the genuineness of them all. In particular the Merlot 2008 was so fresh and rich that I was literally blown away when I tasted it. If you want to understand how an authentic Merlot should taste, Miani is the one.”  Michele Dal Forno is one of Romano Dal Forno’s sons, founder of the legendary eponymous Valpolicella estate  1988 Ch. Montelena, Napa – chosen by Maya Dalla Valle   “After a fantastic 2023 harvest, we are relaxing and celebrating this holiday season. At our most recent team holiday dinner we decided to open a magnum of 1988 Ch. Montelena to commemorate the successes of the 2023 growing season and vintage. With the recent passing of Mike Grgich, it was also an homage to one of the great winemakers of Napa. “People seem to like it,” says Callie Louw in his thick Afrikaans accent. The winemaker behind Porseleinberg shrugs, casual about his wine’s success. Since its first vintage in 2010, this Swartland Syrah has rapidly become one of South Africa’s best and most sought-after, much to his bemusement, it seems.  The 173-hectare estate is rugged and wild, sitting atop the Porcelain Mountain (Porseleinberg in Afrikaans) in the Swartland. The first vines had been planted here in 1997, with wines previously marketed under the Schonenberg label. Louw first came across the site while at Rustenberg, who sourced fruit from there – the bunches and individual berries were so tiny that Louw thought at first that the owners weren’t giving them the best fruit (although he may not have put it so politely). But those miniscule bunches were all these rocky schist soils, with almost no topsoil, could muster. However small the yields, the quality and concentration was enough to convince Marc Kent (Managing Partner and Technical Director at Boekenhoutskloof) to buy the farm in 2009 – and he approached Louw, who was then working at Tulbagh Mountain Vineyards (now Fable Mountain Vineyards), to develop the property.  The team instantly set about a massive planting program and there are around 90 hectares under vine today. Most of the fruit was destined for Boekenhoutskloof’s flagship wine, The Chocolate Block, but with 4.5 hectares of older plots and a ramshackle shed-cum-winery, Louw – with Kent’s blessing – decided to do something different, and Porseleinberg was born.  “It’s a really special site,” Louw says, explaining how the vines sit on almost pure bedrock with just a skin of topsoil over the blue schist. “We’re effectively farming little bonsais here.” It tells you just how challenging this site is that only half the vines they planted in 2009 survived; but the results are clearly worth the effort. And they weren’t the first to recognise the site’s potential – as well as Rustenberg (where Adi Badenhorst was then winemaker), Eben Sadie had sourced fruit from the property for Columella in 2000 and 2001. While the wine came originally from just 4.5 hectares, today there are 14 dedicated to Porseleinberg, with the first of the younger vines coming on stream from 2013. When Louw arrived in 2009, the vines were dry-farmed – and he managed to get 3.5 tons/hectare of fruit in 2010. But the yield was a tiny two tons the following year; it was clear that dry-farming just wasn’t an option for this site, the soils too poor to hold onto the water – if the skies even gave any. “Schist is actually spelt wrong, it’s supposed to be s**t,” Louw says, laughing. Despite the need to irrigate, he’s well aware of the costs involved – particularly given any water they use needs to be pumped seven kilometres and up the mountain. During the drought between 2016 and 2018, the river they use for irrigation dried up, Louw’s house water ran out in May – and police were patrolling water sources. There’s no avoiding how precious a resource water is here.  The site had been farmed organically and Louw continued this, however in 2016, when they looked to plant another 45 hectares, he wanted to make sure that he gave these new plantings the best chance – and be able to farm organically in the long term. As of 2023, the property is once more certified organic, having been able to return to the process in 2020. And it is firmly in the vineyard that Louw focuses, feeling not just that quality comes from the vine – but from the soil, as he gradually looks to build the level of organic matter. “The only thing that I can do better is farm better,” he says.  The winemaking is relatively simple and hands-off (as Louw says, “I’m quite proudly lazy in the winery.”) – but has evolved over the years. Louw uses 100% whole-bunch, although the fruit is crushed lightly (previously by foot, now by being run through a pump) to avoid carbonic fermentation and its more confected aromas. The fermentations are all native, with alcohols generally sitting between 13.5 and 14%. Maturation is in a combination of foudre and concrete, and varied more over the first four vintages as Louw figured out what worked (with the 2010 and 2011 vintages aged in concrete only). While some of the early vintages spent up to two years in concrete and oak, he has reduced this to 12 months (from 2014), favouring more time in bottle prior to release instead.   Although the wines are decidedly fresh and balanced, the pHs are naturally high – between 3.7 and 4.1, with most vintages sitting at the higher end of that spectrum. Given the risks of bacterial spoilage that this brings, SO2 levels are relatively high (around 100ppm total) – something Louw feels is essential for wines that are absolutely built to age. And that’s something that has long set Porseleinberg apart.   “I’m still wearing the pants I bought in 2004 – I know nothing about style,” Louw jokes. There’s no shortage of brilliant new-wave South African wine, however most are built to be open and approachable in their youth – not necessarily glou-glou, but leaning into the lighter style of reds that has become fashionable. Porseleinberg was, at least at first, decidedly not. The earlier vintages are stern and serious, and need(ed) significant time to resolve and soften – it’s that style (whether Louw would describe it as such or not) that has earned the wine the moniker “Cape Cornas”, a style that is both thanks to the natural intensity of the low-yielding site and Louw’s love of old wine.  But the 2018 vintage brought a significant shift – one that has taken Porseleinberg to new heights. Louw visited a friend who was working at Domaine Jamet, and saw how rather than using punch-downs or pump-overs, they submerged the cap throughout the fermentation and maceration, allowing them to extract more gently. Most winemakers might have trialled the technique on a parcel, but not Louw – who says, frankly, “I put my chips all in.” He returned to the Swartland and set to work, making his own plates to hold the cap in place during fermentation. Fortunately for him, the gamble paid off.  The more recent vintages display more perfume, precision and finesse, without sacrificing the almost fearsome structure that makes them so age-worthy – and, as Louw says, it means he does even less work in the winery (“I fit about one more beer in a day,” he says, smiling). While earlier vintages were more about their tannic framework, the fruit, Louw suggests, is more present now – covering the tannins in the wines’ youth.  When I ask Louw if he wishes he’d used the submerged-cap technique from the start, his answer is no. “It’s amazing to grow up with the wine,” he says. And somehow that makes sense, for this is clearly a very personal project. Although Boekenhoutskloof might own Porseleinberg, it is run and managed totally separately. During our conversation and as we taste through a complete vertical, back to 2010 (the first time Louw has ever had the chance to do so), it is clear that this is not just a wine from this specific place, but also from this specific wine-grower. Over 12 vintages, the style evolves, the variation between years shining through, but the mineral backbone and structural imprint of this site remains. It’s a remarkable wine, and one that is only set to get even better as the vines age and Louw builds on his experience. Ignore it at your peril.  Tasting every vintage of Porseleinberg: 2010 to 2021 2010 Porseleinberg: From the original 4.5 hectares, the first vintage of Porseleinberg offers a savoury, bloody, iron-rich nose, with an edge of herbal, menthol notes and dried red fruit. The immense structure is still present, although the tannins have softened with over a decade in bottle. That structure is complemented by a bite of fresher, dark fruit and juicy acidity. Aged for 16 months in 65% foudre and 35% concrete.  2011 Porseleinberg: This wine still feels young, the nose brooding with dark fruit, leather and liquorice, the palate tightly packed with intense, black-berried fruit and a chalky grip of tannins. With the year’s conditions only two tons per hectare were harvested, the smallest crop ever from the site – and given the small volumes this was never released, with only 800 bottles made. Aged for 24 months in concrete egg.  2012 Porseleinberg: This is more supple and soft than the 2012, with a savoury and saline profile. There’s more elegance than the first two vintages, with dark, intense fruit yet with an appealing purity, complemented by notes of tobacco spice and liquorice allsorts. Only 2,760 bottles were made. Aged for 12 months in concrete egg.  2013 Porseleinberg: The fruit here is distinctly different – sweeter strawberry with a touch of herbal eucalyptus alongside savoury hints that point to the beginnings of tertiary development. It’s incredibly concentrated, structured and compact – a wine that is built for the long-haul. Aged for 24 months in 60% foudre and 40% concrete.  2014 Porseleinberg: The 2014 was one of the more open vintages in the line-up, from a particularly wet year and late harvest. The nose entices with an earthiness, a dusting of cocoa, deep red cherry and chocolate-covered strawberries. There’s a juicy purity to the palate with a chalky grip and savoury, smoky edge to the long finish. Aged for 12 months in 100% foudre.  2015 Porseleinberg: This is still a little reductive, and will benefit from additional time in bottle. As this reduction blows off, it reveals a fynbos-accented nose of dark fruit. From a cool vintage, the palate is a tight ball still – intensely mineral and chalky, with impressive purity, but it’s not yet revealing its potential. One to watch. Aged for 12 months in 90% foudre and 10% concrete egg.  2016 Porseleinberg: The 2016 vintage brought the driest winter in decades and another tiny crop. The wine is full of sweet red fruit, but there’s a firm, stony minerality to the nose, as well as floral and spicy tones that give it lift. There’s a fine-boned framework here and gorgeous freshness. Aged for 12 months in 70% foudre and 30% concrete egg.  2017 Porseleinberg: The 2017 vintage is sweet and concentrated; offering both a swarthy dark profile and a sweet, red-fruited intensity. It’s tight and bold, with an iron backbone, firm tannic structure and a powerful finish defined by its dark fruit and minerality. Aged for 12 months in 70% foudre and 30% concrete egg.  2018 Porseleinberg: The 2018 vintage is the first in which Louw used the submerged-cap technique – and there’s an instant shift in the style of the wine. It’s brighter, more aromatic with more intense herbal and spicy notes, while the palate is layered with juicier, crunchy red fruit that masks the tannins. The finish is long, spicy and mineral. Superb. Aged for 12 months in 90% foudre and 10% concrete egg.  2019 Porseleinberg: This vintage saw a break in the drought for South Africa, with rainfall around average and a relatively cool growing season. The nose here is dominated by herbs and spice – green peppercorn, dried rosemary and sage; leading on to a palate that offers pure red-berried fruit. There’s a mineral, chalky, furry grip of velvet tannins that frames the generous cherry fruit, with a saline mineral finish. Delicious. Aged for 12 months in 90% foudre and 10% concrete egg.  2020 Porseleinberg:  The 2020 vintage was warmer and the wine speaks to that – with richer and darker fruit character that dominates its profile. The warmer conditions have added a polish to the wine, with more open feel, despite the trademark structure that sits behind the fruit. The wine is a little reductive at this stage, and needs more time to unfurl. Aged for 12 months in 90% foudre and 10% concrete egg.  2021 Porseleinberg: The latest release of Porseleinberg is unsurprisingly impressive, but with a finesse that suggests it could be Callie Louw’s best vintage to date. A long, cool growing season with sufficient rainfall resulted in a leisurely harvest in 2021, allowing the team to take their time to pick. Since the shift to submerged cap in 2018, quality here has leapt ahead. The 2021 shows a spicy, mineral intensity – with the fruit more subdued, taking a backseat to the stony structure and texture of the wine. It’s supple, flowing across the palate like silk, yet with a super-fine grip of mineral tannins and the shy fruit that points to its immense age-worthiness. Savoury herbal tones mingle with the red fruit, while there’s a saline freshness and spicy pepper tones that linger on the long finish. Amazingly approachable now, it will only improve with a couple of years in bottle and continue to evolve over the next 15 years or so. Porseleinberg: an icon in the making

I vividly remember the first time I tasted the Alvina Pernot wines. Burgundy was bitingly cold, and we ducked beneath Alvina Pernot and her husband Philippe Abadie’s home into their make-shift cellar, then delightfully cosy (at the time warmed just enough to encourage malolactic fermentation), and a welcome retreat from the Côte d’Or’s bracing winter weather. We squeezed into the tiny cellar, edging between the barrels crammed into the space. The wines were thrilling. Taut and pure styles of modern, pinpoint, mineral Chardonnay that were – and are – hard to resist. We were tasting the 2019s, just the second vintage from the modest operation; but they’ve rapidly established themselves as one of the Côte de Beaune’s most exciting new names. Alvina – always chic, dressed immaculately, with her gleaming green eyes and delicate features – doesn’t look like the stereotypical Burgundian vigneron. You're unlikely to spy dirt under her fingernails, and I struggle to imagine her sporting a pair of overalls. But wine is in her blood. The Pernot name is one that will be familiar to Burgundy-lovers – the family is one of the largest vineyard owners in Puligny-Montrachet (just after Leflaive), and makes some of the village’s best wines. Indeed, Alvina worked for the family estate Domaine Paul Pernot for years, but the urge to break out on her own grew over time. The Paul Pernot wines are the epitome of traditional white Burgundy, round, rich and sometimes sumptuous – and Alvina and Philippe wanted to make something of their own, a leaner style that suited their palates better. In 2017, a vineyard came up for sale – and it seemed like a sign. The plot, La Rue aux Vaches, is classified as village Puligny-Montrachet, but sits just below Premier Cru Clos des Meix and Les Pucelles. The family domaine had been farming and making wine from the site for years, and the couple knew how good the fruit was. They leapt at the chance to buy it, and the Alvina Pernot project was born. They were able to buy additional fruit from Alvina’s family, and started working on sourcing grapes from other Crus. Their first release, from the 2018 vintage, totalled 8,000 bottles. It's easy to see how challenging it might have been – going from working for the family business to setting up a separate project, and bearing the weight of their legacy. Alvina and her father have very different approaches in both the vineyard and winery, which certainly comes with its challenges, as they find the fine line between family and business, negotiating a new aspect to their relationship. “I think Alvina’s father was proud that she was starting something of her own,” Philippe says, looking affectionately at his wife. Indeed, it’s taken time for Alvina to fully step away from the family business, only officially resigning in March of this year to focus on their own label. Juggling the two estates (not to mention their son Pâris, who was born at the start of 2022) hasn’t been easy, and Philippe has – until now – had to do much of the work in the winery. Yet it’s also their family ties that have given them access to such incredible vineyards – appellations that are almost impossible to secure for most newcomers.  Five vintages in, it’s amazing to see how the project has evolved. They now produce 35,000 bottles, with the range having grown from seven to 24 cuvées. The duo are so embedded in the region and well-connected that they are able to source from some of the region’s best names, securing top sites that would be the envy of most estates. In addition to La Rue aux Vaches, they now own two further plots (both of which previously belonged to Alvina’s family): Les Noyers Brets (which is next to the couple’s home, added from 2020) and La Rue de Bois (the latter the vines that surround their winery, added in 2021). The focus is increasingly on specific sites within Puligny-Montrachet, with an ever-increasing number of Premiers and Grands Crus. In 2022, for example, they bottled three different wines from Folatières – Ez Folatières, Peux Bois and Clos des Folatières; and their Bourgogne Blanc has been divided into two different bottlings from different sites. Until 2021 the wines were made at Domaine Paul Pernot (and aged under Alvina and Philippe’s house) but the couple have now finished their own winery – giving them greater capacity, but also even greater control over the wines they’re making. From better temperature control and a broader range of maturation vessels (including both glass and amphorae, alongside oak) to reducing sulphur levels and more control over bottling, it’s allowed for even more precision. Each year, they tell me, they are pushing and doing “des petits tests”, looking to tweak and see how they can improve.  Alvina and Philippe firmly believe that almost all the work has to be done in the vineyard, with farming the three plots they own a huge part of what they do. Philippe has been doing it almost entirely himself – and is relieved that they’ve just been able to hire someone to help them. But the significance of the vineyards work is also why it is so important for them to source fruit carefully from growers with similar standards, and whom they trust. As with any small producer, the challenge when it comes to farming is not just quality, but quantity. Alvina and Philippe do almost everything by hand (indeed, they don’t even own a tractor yet – and still borrow Alvina’s father’s one when they can), and sustainability is a key focus. After pruning, it’s common in Burgundy to see the horizon dotted with smoking fires, as the cuttings are burnt; Philippe and Alvina avoid this and the resulting pollution, instead using the cuttings for a mulch to further increase the organic matter in their soils. They aren’t looking to be certified organic, but avoid chemical sprays wherever possible and are doing trials with biodynamics; the risks, and costs, are the threat, however. They can’t afford to lose an entire crop, as would have happened in a vintage like 2021, should they have refused to use anything but copper and sulphur; nor do they want to have to sell their wine for five times as much as they currently do, to allow such a philosophy. Ideals can only take you so far. While 75% of the job might be done by the time the fruit is harvested, it’s all too easy – even with the very best fruit – to ruin it all in the winery. “There’s nothing minor during vinification – everything matters,” Alvina explains. “Each tiny detail makes the difference between an average wine, a good wine and an excellent one.” Although between them the duo had plenty of experience, nothing is set in stone, and each year they feel they are learning more – as they continue to question what they do and why. “It’s also important not to be too wrapped up in our little cocoon, just the two of us, but to talk honestly each year with our expert oenologist [Pierre Fonteneau] about the wines,” Philippe explains, when it comes to the winemaking. “There are three voices in the business – Alvina, me and the oenologist – and not one counts less than the others.” It’s easy to imagine that any Burgundy producer’s goal is to be a domaine – to own a prime selection of the region’s most prized sites; but for this young couple, that’s not really the aim. Alvina is set to inherit some enviable plots, but they can’t imagine giving up the opportunity to continue working with many different parcels. “The diversity of terroirs is absolutely the most interesting part for us,” they say. It’s likely their range will continue to shift – as they get access to new, exciting parcels and discover those they really love. Ultimately, however, Alvina explains, “The aim is to make wines we love, the wines we want to drink. Few wine estates have the history or pedigree of Ch. Lafite Rothschild. Grapes  have been grown on the estate’s hallowed ground in Pauillac since 1707 and the property has been in the same family (the Rothschilds) for over 150 years. It is the First Growth that became the most desired and collectable, loved for its elegance. Lafite, more than any other estate, had a huge influence in drawing Asian customers to Bordeaux – who, with their immense buying power, have been instrumental in transforming the region over the last 25 years. With such a reputation, the expectations of tasting benchmark Lafite vintages back to 1960 at the Rothschilds’ 19th-century Buckinghamshire estate, Waddesdon Manor, couldn’t be higher. The vintages on show were hand-selected by Domaines Barons de Rothschild’s International Director Jean-Sébastien Philippe who has an encyclopaedic knowledge of every vintage back to the 1920s. Philippe wanted to show how Lafite has an extraordinary capacity to age and an incredible ability to retain freshness, even 50 years or more into its maturity. The main event would pitch the more modern vintages of 2010 and 2005 against the 1990, 1982 and the elusive 1960 – all epic vintages for Lafite. Every wine was sourced directly from Lafite’s cellars and all were served from either magnum or double magnum. Philippe believes magnums are without question the ideal size for maturing wine and, by pouring from larger formats, it meant all the guests got to experience each vintage from the same bottle and therefore avoided any potential bottle variation across the table. Alongside these legendary vintages of Lafite, Philippe also wanted to showcase mature vintages of the neighbouring Ch. Duhart-Milon, also owned by Domaines Barons de Rothschild. With the same winemaking team at both Lafite and Duhart-Milon, it was fascinating to taste both the 1990 and 2005 Duhart-Milon against the same vintage from Lafite. The vines at Duhart abut Lafite’s own vineyards and are known for their quality, if not quite the same level as Lafite. It is a little unfair on Duhart-Milon, but tasting them side by side beautifully highlighted the extraordinary depth and sustain you find at Lafite, that the terroir of Duhart just cannot match. Duhart-Milon has been rewarded with plenty of investment from the Barons de Rothschild group in recent years, both in the vineyards and with a newly built winery. The 2022 is arguably their best vintage to date and the 2020 was also outstanding and surpassed any vintage prior. The estate since 2018 really has been on an impressive trajectory. For Philippe, Duhart is the epitome of Pauillac terroir – Cabernet-driven, with great linear structure and a distinct graphite minerality. While the 2005 and 1990 were not from the property’s heyday, they have matured beautifully. There was a touch of brettanomyces (a yeast that gives savoury, barnyard or even fabric plaster notes) on the 1990 which the guests were all in agreement was no bad thing, joking that everyone loves a touch of brett in mature Bordeaux. But the wines were fresh, vibrant, classic in style and impressively structured. Against the Lafite, they were no competition. Each vintage of Lafite fanned out so much more on the mid-palate, the dense, layered tannins are so plush and refined, while the freshness on the finish leaves the palate salivating. There was a debate at the table whether to start with older vintages and finish with younger ones or the other way round. It became clear with all the wines poured, why it’s so important to taste younger vintages first. In isolation, the 2010 was outstanding. The tannins were still firmly clenched but the depth and the Lafite elegance was all there. It was brooding but still beautiful. Philippe is convinced it is one of the greatest Lafites ever to be made and with maturity will compete with the 1959, 1953 and 1982. Tasting the 2005 alongside the 2010 shows how much more the latter wine has to give, with the 2005 that little bit less tightly clenched on the palate. The 2005s are famously tight and only now starting to unfurl, but while 2005 Lafite has fantastic depth and extraordinary length you just know it still has so much more to give. This wine has decades ahead of it, but several commented how much the 2005 has opened up in the last year. Philippe believes the 2005 still has at least another five years before this is going to even start to show its full potential. It is a wine whose peacock-tail finish started to get the adrenaline pumping, in perfect preparation for what was arguably the wine of the night – the 1990. Just dipping your nose in the 1990, you realise this is Lafite in top gear. Beautifully exuberant, a perfect blend of primary fruit, tertiary notes, cedar wood and earthy, mineral tones – you could smell it all night. The density found in the 2010 and 2005 was present too, but the tannins have relaxed and the wine fully unfurls on the palate bringing extraordinary depth. And it is here where the freshness hits you. This 33-year-old wine has such vibrancy, an energy that just lifts the wine and gives it a wonderful ethereal quality – not a description I would normally equate with Pauillac. The finesse is breath-taking. Having tasted the 1990 almost 15 years ago, it was fascinating to return to it and see it has only improved in that time. At 33 years old, this wine is at its peak. The 1982, the most eagerly awaited vintage of the line-up, could perhaps not live up to expectation despite its arresting nature. It is a terrific wine and, again, the freshness in what was a hot vintage is hard to believe. Philippe noted that the ’82 – despite its mythic status – is not a perfect wine, but is a testament to Lafite’s ability to excel in hot vintages. Philippe believes this is because the terroir at Lafite means the vines naturally close down in hot vintages, reducing sugar production in the grapes. It also gives a contrasting menthol freshness to the wine, which means it remains moderate in alcohol and yet does not taste phenolic or underripe. What is perhaps more extraordinary is that the ’82 was in fact a bumper vintage, with Lafite cropping at 80hl/ha. That is double the production at Lafite today (in a good year), which goes some way in realising the qualitative measures that have been taken at the property over this time. Despite the high production levels, the ’82 is stunning. This bottle didn’t quite have the vitality of the 1990, so it’s worth cracking on with any bottles you are lucky enough to have in your cellar. The final vintage was the elusive 1960. With a table of avid Lafite fans, no one present had tasted or knew much about the 1960. For Philippe it is arguably better than the legendary 1961. It features in a rare consecutive trio of exceptional vintages in the estate’s history. Philippe explained the phenomenon has only happened three times in the history of the estate: with 1959, 1960 and 1961; 1988, 1989 and 1990; and 2018, 2019 and 2020. In the oldest trio, Philippe actually thinks the ‘59 is perhaps the greatest vintage ever at Lafite, followed by the 1960 and then the 1961. My tasting notes for the 1960 started with “surprising freshness”, but perhaps I should have known better by this stage that Lafite’s ageability is not really in question. The wine was in exceptional condition and poured from magnum. It had fantastic structure, classic mature Cabernet linearity but with a plushness to the mid-palate that is typically Lafite, but still a surprise at such maturity. The wine was full of tertiary notes, dried fruits, savoury spice and cedar wood. It was so vibrant, so energetic, it seems that the 1960 is likely to see out its centenary in style. What a wine!
