The Pont des Arts project was created by Thibault Pontallier (son of Paul Pontallier, the celebrated winemaker of Château Margaux from 1983 to 2015) and Arthur de Villepin, an art curator from Paris. Both Thibault and Arthur come from high-profile backgrounds, with Arthur the son of the former French Prime Minister Dominique de Villepin. Growing up in such a prestigious and privileged environment introduced them both to the world’s most exciting artists, as well as the world’s most successful winemakers. It was this immersion in both the world of fine art and fine wine that spawned the Pont des Arts project.  “My family has been making wine for more than 500 years, and since I was a kid I have always considered winemakers to be amazing artists who are able to transform and sublimate nature into something truly special and emotional,” says Thibault. “My father used to say, ’A good wine gives you pleasure, but a great wine can give you emotion‘, and it is exactly the same for a great music, movie or painting.” Pont des Arts is very much a project to combine these two cultural worlds, producing wines made – and inspired – by artists. “A certain painting will be able to show and express the depth, the power or the finesse of a subject,” explains Thibault, “and wines can do the same thing. It is the perfect metaphor to understand the magic behind a wine.”   The project aims to position the wine as a bespoke creation. Each winemaker involved in the project has produced a wine distinct from their “normal” range, bottled exclusively for Pont des Arts.  It is then down to Thibault and Arthur to identify how the wine resonates with an artist’s work. “Arthur and I went to the artists’ ateliers, and met with the winemakers for each collection, carefully thinking about the association between each painting and each wine, and to ensure the emotions that are evoked when drinking great wine or looking at great art are intrinsically linked.”  The first collection of wines was curated in 2010 and was in fact a collaboration with Thibault and his father Paul Pontallier. They both travelled throughout France to find inspiration from their many winemaking friends around the country. “My father, a few good winemaking friends and I looked for months for the best terroirs and the best grapes, tasting more than 700 different parcels in France to realise this unique project.” The selection process for them was clear from the outset. For each wine they were looking for three main attributes: “Each wine must have a very special perfume, epitomising each appellation, a huge power hidden by elegance, and a fresh lingering finish.”   Following the success of the initial releases, their collaborations with winemakers grew. They started to work with more vignerons who shared their philosophy and whom they wanted to work with. Etienne de Montille, Rodolphe Péters (of Pierre Péters), Château la Conseillante and Nicole Rolet (of Chêne Bleu) have all made special cuvées for them. “The most important thing is that behind each collaboration is a beautiful friendship, a shared vision, love of wine and trust. We work very closely with each winemaker for every collection. Making sure everyone is part of the process and that the art and the wine complement each other perfectly,” says Thibault. “The wines themselves are works of art, so we spend a lot of time deciding on each new creation.”  The success of the project has seen winemakers entrust Pont des Arts with some very special cuvées. Giving the team amazing access to some rare Premier and Grand Cru wines from some of France’s most celebrated terroirs. With such quality the volume unsurprisingly remains very small, each cuvée exceptionally rare and becoming harder to find, “Exactly like the great pieces of art we work with,” explains Thibault. “What I love with this project is to see the excitement of the winemakers we work with, because they can create something unique and different for Pont des Arts, something different from what they were doing in the past. Our aim is to give them freedom and allow the creativity to create something unique and special.”  Perhaps Pont des Arts’s access to some of the world’s finest winemakers and terroirs is not such a surprise given the reputation of Paul Pontallier. Securing artists for the project seems more difficult, particularly with such famous artists as Piet Mondrian. While some of the artists – such as the Spain’s Miguel Barceló and French Chinse Artist Zao Wou-Ki were long-term friends of the Villepin family, for artists like Piet Mondrian, Thibault and Arthur were in touch with the estate throughout the whole process (design, production, labels etc). “They were very happy to help us develop this collection as they liked the initiative behind Pont des Arts.” Thibault is keen to convey “a message with authenticity and passion,” he tells me. “I guess the people we are collaborating with can sense that, which makes everything much easier.”  The Pont des Arts project continues to expand with some of the world’s most exciting contemporary artists and winemakers lining up to take part in new collaborations. One of the latest releases to come from Pont des Arts is a Grand Cru Blanc de Blancs from renowned winemaker Rodolphe Péters of Champagne Pierre Péters with artwork by Miquel Barceló on the label. There are interviews, and there are conversations. And this meeting with Italian cashmere tycoon, Brunello Cucinelli, definitely falls into the category of the latter. Cucinelli has conquered the world with his products, his perception of style and beauty, and has published a book outlining his particular approach to doing business which he defines as “humanistic capitalism”.   This distinction between interview and conversation is a necessary contemplation; understanding the meaning behind the words, selecting them carefully, tasting each of them in a silent meditation. This is, in fact, the first step to allowing you into Cucinelli’s world, where external quality is just as important as inner quality. To him, as to late 18th century German philosopher Kant, beauty is a moral interest.   The word “interview” is composed of two parts: “inter”, which implies reciprocity, and “view”, which refers to sight; each looking at the other, trying to truly see. It is not a given that this is always successful.   A conversation, however, is different. The word derives from the Latin “conversari”, composed of “con” meaning “with” or “together”, and “versari”: to reside, to find oneself. It is a meeting – a graceful way of getting to know each other, or getting to know each other better. It is a way to agree upon certain behaviours and visions in order to truly share a physical place, as well as a state of being. In this conversation, we meet Brunello Cucinelli in Solomeo, Umbria, Italy. He reminisces that, The New York Times once published a map of must-see places in Italy – in which Solomeo was included along with Venice, Florence, Rome and Naples. Cucinelli states this with no small amount of pride.  Despite the lockdown, and an obligation to talk through a screen, encouraged by both the pandemic and by a sense of caution, Solomeo is truly the location of our meeting – and not just because Il Sogno di Solomeo (The Dream of Solomeo) is the title of his book, in which he recounts his life story, the roots of his success, and his vision as an “entrepreneurial custodian”. Solomeo enters through the window, breathing audibly in the background of the words and thoughts which define our conversation. It speaks through Cucinelli’s expressions, bringing to light a kind of organised peace within his sense of time, its horizons are centuries-old, and reside in diligent silence. It speaks of a knowledge acquired through generations passed, to be shared with generations to come.  We are in Umbria, just 15 minutes from Perugia and only one hour from Florence. Only 800 people live in Solomeo – a stunning, almost-abandoned medieval village brought back to life by skilful restoration work led by Cucinelli over the last 25 years. The village of Solomeo was revitalised as an allusion to Rome, the city of Emperor Hadrian’s soul, according to French novelist and essayist Marguerite Yourcenar. Creativity needs a “genius loci”, a safe space. Cucinelli restored a village that was “robust, useful, and beautiful”, as instructed by Vitruvius. Onora tutti gliuomini (“honour all men”) is the inscription displayed in Solomeo’s Piazza delleArti, and is also the motto which inspired Cucinelli’s humanistic capitalism. He believes gift-giving to be one of the kindest forms of the soul, and he loves to give presents of homemade oils and wines; believing that, in every gift, there is also a piece of Solomeo.   Cucinelli’s love of philosophy, and his habit of allowing the great minds of history to dictate his approach to beauty, is also a lesson Cucinelli learned in youth as a farmer, when he used to pull the ox plough and till the fields. In the evenings, his father would encourage him to admire the beauty of those ploughed fields, the neat ridges stretching over the hills.   His sensitivity to the idea of living in harmony with nature was born from this, as was his ability to recognise that there is greater value in that which is carried out with beauty in mind. His more practical attention to the selection of raw materials also stemmed from these roots – his respect for producers and collaborators, and his ability to think in terms of centuries, not years. All this has rendered Brunello Cucinelli one of the world’s most famous luxury brands.   Beauty is also a form of truth. As three Buddhist monks remarked to him, upon visiting him in Solomeo, there are three things which cannot remain hidden: the sun, the moon and truth. In order to live well, beauty requires you to take care of your soul, your mind and your body. This is why, at Cucinelli’s company, at half past five in the evening, the computers are switched off, the working day completed. The body, mind and soul need a life outside work, to be able to look themselves in the eye and overcome the “soul-ache” that creativity can also help to alleviate.  To him, beauty is also a business method; his humanistic capitalism was not cast aside even during the crisis sparked by Covid, during which time Cucinelli did not let a single employee go, or ask for any discounts from producers or suppliers. This is part of an ethical business vision which considers humanity as an end, and never as a means; it is defined by considering the businessman as a “custodian of creation”. Developing this idea of being a custodian, Cucinelli sees that luxe can be interpreted as an orchestrator of sustainable development.   Brunello Cucinelli smiles. He likes the words of 15th century Florentine Republic ruler, Lorenzo the Magnificent – “How beautiful is youth, / though quickly it does flee! / be happy if you want to: / for tomorrow may not come” – which recall an Italian sense of national pride. Although home to only 0.7% of the globe’s population, Italy boasts one of the the world’s top 10 economies; it excels at quality manufacturing and craftsmanship; it offers a welfare state which leaves no one trailing behind. He sees a great country and a golden era, in spite of the crisis. He does so with a pinch of the “Italiote”, as Plato called the people of Syracuse when he reached Sicily from Greece, “a population which feasts twice a day and never goes to bed alone”.  We are also like this, he says, before returning to consider the ideas of creativity and responsibility. “It really is possible to live in harmony with creation. And this makes us custodians, not consumers. I also think of my product as something to be desired, something to be inherited. That is why I chose cashmere. I wanted something that was already precious. I’ve learnt to transform it over time. I’ve made mistakes, had teachers and guardian angels that have helped me and taught me. But the principle was already clear to me, right from the beginning: to create beauty, you need to begin with something beautiful, from an exceptional raw material. And you also need to believe that it will last for centuries, not for years. Before it became fashionable, we had already opened a restyling and reusing department for our garments. Because, for a jumper to be beautiful and precious, it must also stand the test of time.”   “Verum factum”, as stated by 17th century Italian political philosopher Giambattista Vico: nothing is true unless it has been done. The humanistic capitalism in Solomeo is evident: an art of Renaissance-style trading which has taken over the world, yes. But it has done so with honour. It possesses a beauty which is markedly exclusive, moving against the crisis of civilisation. It is something that manages to make itself be considered as rare, something precious, only for you. It requires time, artisanal hard work and precision, fighting against the culture of impatience. In fact, Solomeo’s theatre is crafted from hand-cut stones, with walls built to endure. The company itself is located within a restored factory which opens out onto gardens and spaces where it is impossible not to inhale the surrounding beauty.  Most of the employees and managers within Cucinelli are young: this is because they are hard workers. It is also because beauty and fairness produce brilliance. Cucinelli is the one to engender this genius. “Oh, myesteemed men!” (O miei stimati uomini!) Cucinelli quotes Marcus Aurelius. It is from this statement that he has learnt to recognise value, to respect and admire, and to never rise above dignity. He applies the concept of remote working only when strictly necessary, because creativity dwindles and becomes degraded by a lack of human contact.   The story of humanistic capitalism is so long to recount (and so wonderful to hear) that Cucinelli has summarised it within his book, Il Sogno di Solomeo. These ideas, typically influenced by previous generations, took inspiration from the manual The Book of the Art of Trade by Benedetto Cotrugli – an Italian merchant during the Renaissance era – which speaks about “getting rich honourably”. One can choose whether to be “a seeker of work or a creator of work”: therefore, an entrepreneur is someone who creates development for themselves and for others. On one hand, there is the revaluation of the role of whoever decides to take this risk; on the other, there is the idea that they are doing so by enforcing a strong sense of ethic. A sort of return to business. An important lesson.  Cucinelli notes that, in Cotrugli’s story, this is fulfilled out of duty rather than pleasure. The death of his father in 1438 forced him to abandon his studies and take the reins of the family business. This was during a time when Italy was bestowing the Renaissance upon the world; and Cotrugli, who originated from Ragusa (currently known as Dubrovnik – which, at the time, was considered the fifth Italian Maritime Republic), was catapulted to Naples, in an environment where ethics and morals evidently left a lot to be desired. The family business, and by extension, he as the owner, “bought wool in Barcelona; turned it into cloth and thread in Florence and Prato, to then sell it on again in Constantinople and Venice”. Cotrugli travelled, visiting cities which formed the heart of that golden era. He breathed in the air of Florence, which was, at the time, Europe’s most powerful guild, and produced figures such as Donatello, Masaccio and Brunelleschi.   Among the 15 golden rules for “getting rich honourably” outlined within The Book of the Art of Trade, Cucinelli feels a “deep resonance” not only because of its modernity and its entrepreneurial insight, “but mostly for the system of values it imposes and passes on”, to “get rich honourably” by creating work and development with consistency. And he thinks back to the crisis, echoing the words of Roman statesman Marcus Tullius Cicero, as quoted by Cotrugli: we must not waver in the face of adversity or lose ourselves in our own prosperity. “Let’s talk about what this year has brought us, not what it has taken from us,” he states.   And this is the truest representation of a dedicated and kind businessman, who has spent half his time gazing up at the stars and loves to watch a fire flicker because it makes him “drunk on pleasant thoughts”. Life is blessed. We eat only what we must, so that there is enough for everyone. There was Seneca, there was Epicurus, and now there is the wonderful dream of Brunello Cucinelli and his beloved Solomeo. He spends his years contemplating centuries past and considering those to come. This, in itself, is a rare form of immortality.  In 2011, Cucinelli planted vines in the valley below Solomeo, and the first vintage of the wine made from this special site – 2018 Castello di Solomeo – is available from FINE+RARE. We have unearthed an absolute gem in the guise of Rosso della Centa, a 100% Merlot wine grown on just one hectare of a distinct marl clay hillside in Friuli, Italy. The wine is the creation of one of Italy’s top winemakers Nicola Manferrari who first produced the wine in 1985 and has gone on to release it only in top vintages, producing just 1200 bottles per vintage. 

As we have managed to source a small parcel of Rosso della Centa 2010, we explore the history of this incredible and rare wine.  Friuli ranks highly among Italy’s finest regions for white wine production, producing some of the most vibrant, mineral, saline whites on the planet. The global reputation of the top wines of Friuli continues to grow, gaining fans throughout the world and firmly positioning it on the global fine wine map.   Whilst more famous for their white wines, top grower Nicola Manferrari has a very special one-hectare plot dedicated to red wine. On taking over the family vineyards in 1982, Nicola was not happy with the quality of wine coming from this Merlot site. So much so he took to studying French and French winemaking to learn the secrets of Bordeaux and then apply these techniques to his own wine, to get the best out of this unique site. He states that François Champagnol’s Elements de physiologie de la vigne was one of the most intellectually stimulating reads of his life. Nicola Manferrari is one of Friuli’s original trailblazers. Along with Mario Schiopetto, Josko Gravner and Silvio Jermann, Manferrari was just one of a handful of producers in the 1980s who had the vision and courage to follow his convictions.

He experimented with the 1982,’83 and '84 vintages before he was happy with the techniques he had adopted and, matched with the perfect weather, managed to produce something exceptional, releasing the inaugural Rosso della Centa in the 1985 vintage. Nicola was confident that he could create the first world-class red wine from the region and was not swayed by his neighbouring premium sites opting to plant Cabernet Sauvignon rather than Merlot. But for Nicola he believed the Merlot was perfect for the clay and collio marl soils in which Cabernet Sauvignon struggled.   The ’85 was a critical success, described by the critics as the "First Great Friuli Red". Other greats of the region include Enzo Pontoni of Miani fame and Christian Patat from Ronco del Gnemiz have followed in his footsteps making incredible Merlots from the Friuli region.
Nicola Manferrari continued to improve the wine buoyed by its critical acclaim, further reducing the yield, increasing the vine density (more than 7000 hectares per hectare), introducing shorter pruning techniques, using no fertiliser and complete grassing in the vineyards to improve the soil health. The wine is fermented in small 12 hl wooden vats and are matured in small oak barriques for four years. Only the finest vintages are released as Rosso della Centa. 
In the summer of last year Monica Larner (Wine Advocate) had the opportunity to taste some more recent vintages of Rosso della Centa. “Looking over my scores, I can't help but notice how consistent they are across vintages and varieties. Results like these are hard to achieve, but not at Borgo del Tiglio. She goes on to describe the ’06 as “musical and operatic in character… there is complete harmony and silkiness here in another gem from Borgo del Tiglio’s cellar”.

Larner did not have the opportunity to taste the mythical 2010 but we pulled a cork on it this week to find out how the wine has developed and we were blown away by the quality. This is a superb rendition retaining everything that is great about Italian wine – the acidity, freshness, dried floral notes and herbal spice along with all the greatest assets of fine Merlot – the rich expansive multi-layered tannins that provide tremendous depth on the palate and the rich mid-palate juiciness full of black fruits and now with age a beguiling leather and earthy savoury notes. The wine has tremendous energy whilst showing handsome tertiary development and to retain so much acidity in a grape that often lacks it underscores just how fantastic this wine is. 

Nicola believes this steep southwest slope of marl and sandstone is perfectly adapted for his old vine Merlot providing a marked elegance and complexity in his Rosso della Centa. The 2010 certainly reflects this and with only 1200 bottles produced virtually impossible to find. This is a unique parcel unlikely to be seen again and is entering into a beautiful drinking window. This wine is a piece of Italian winemaking history and one for any afficionado not to miss. 

It is always difficult to put fine wine into words but Nicola Manferrari’s philosophy outlined on his website gives possibly the greatest insight into this pioneering spirit of Friuli:
“I believe that in effect, the path I have followed has left its mark on the character of my wines which have, according to many, their own maker’s trademark. Over the last twenty years, I have transformed, studied and debunked certain common beliefs and have also overcome - while allowing plenty of room for the sacrilegious power of empirical observation – some of my own personal taboos. I have observed, researched and innovated in the face of hypocrisy and prejudice. 

"Often, however, while doing this I have unwittingly renewed ties with ways of the past which were interrupted by a modernity which had lost all sense and memory. It was probably my unorthodox approach to the world of wine that has guided my choices, meaning this also includes my checkered educational history; I was at the same time a child of scientific teachings and an orphan of technology. This has taught me to take absolutely nothing for granted, and the words of Galileo, which accompany me wherever I go, have taught me to be humble when facing all situations, and to be dignified when dealing with people.”

When the Bordeaux Chamber of Commerce ranked Bordeaux’s leading estates by price for the Exposition Universelle in Paris in 1855, I doubt they anticipated we’d still be using it over 150 years later. Napoleon III had asked the team to put together an exhibition for the world fair, and the Chamber of Commerce neatly passed the buck to the region’s courtiers or brokers, asking them to create a list of the region’s best wines, broken into five tiers. They did so in just two weeks, basing the list almost exclusively on price.  The original classification ranked 58 properties, from First to Fifth Growth, or Premier to Cinquième Cru Classé (with Cru Classé literally translating as “classed/classified growth”). At the very top of this quality pyramid was Ch. Lafite, deemed the “premier des premiers” of the time. The properties were almost exclusively in the Médoc, with Ch. Haut-Brion in Pessac-Léognan the one exception.  It is often said that there has only been one change since the 1855 classification’s creation, however that’s not quite true. Ch. Cantemerle was added in 1856 (having been left out of the original ranking by accident). Ch. Pichon split in two, the Léoville estate into three and Batailley was also divided – but two properties also merged (Pouget and Pouget Lassale), while Dubignon was absorbed entirely by other addresses. Interestingly, Ch. Gloria consists exclusively of vineyards that were classified originally, although the château wasn’t classified in 1855.   The most significant change, and the one most often mentioned, was in 1973 when Ch. Mouton Rothschild was upgraded to First Growth status. The property had only just been acquired by the Rothschild family in the 1850s, so was intially ranked as a Second Growth but Baron Philippe de Rothschild made it is life mission to get it officially recognised as one of the Left Bank’s five leading addresses. For years the property’s labels had read “Premier ne puis, second ne daigne, Mouton suis” (“First I cannot be, second I do not deign to be, Mouton I am”), which was changed to “Premier je suis, second je fus, Mouton ne change” (“First I am, second I was, Mouton doesn’t change”) after the Baron’s bid was successful, and the estate’s premiership was legally recognised.  There are 61 estates in today’s classification, with five First Growths, 14 Second Growths, 14 Third Growths, 10 Fourth Growths and 18 Fifth Growths. Unlike in Saint-Emilion’s classification, a property is free to buy and sell vineyards, with their expansion or contraction not impacting their classed growth status.  Although the classification has never been reviewed, it remains largely (and surprisingly) accurate – the premium price associated with higher status and quality seemingly providing sufficient incentive for producers, and the market effectively deciding on a property’s status.  Today there is also an unofficial group known as the “super seconds” – estates that are thought to produce wines that are as good as those of the First Growths. This includes Pichon Baron, Pichon Comtesse, Lynch-Bages, Léoville Las Cases, Léoville Barton, Ducru-Beaucaillou, Cos d’Estournel, Montrose, Palmer, Pontet-Canet and La Mission Haut-Brion.  While we tend to consider only the red wines of the northern Gironde in reference to the 1855 classification, the sweet whites of Sauternes and Barsac were also ranked. The wines were only put into two classes, with 21 estates included. Nine estates were deemed worthy of First Growth status, 11 as Second Growths, with Ch. d’Yquem earning its own special category as “Premier Cru Supérieur”.  As with the red classification, the number of estates has grown as they have divided over the years (such as the Doisy estates), with one disappearing entirely (Pexoto – its vineyards are now part of Ch. Rabaud-Promis). There have otherwise been no changes.  The sweet wine classification is of little consequence today, however the estates collectively represent 45% of the surface area of Sauternes and Barsac, and produce 30% of the area’s wines today.  Beyond the 1855 classification, the Left Bank also has its Crus Bourgeois and Crus Artisan, as well as the 1959 Graves classification (read more about these here). The Right Bank still only has the Saint-Emilion classification – one that has caused enough controversy to put Pomerol off doing anything similar. Colin Scott should be one year into his retirement. After 47 years at Chivas Brothers, 31 of which were spent as the Master Blender, he should be enjoying a well-earned rest. Instead, the ebullient Scott is lighting up the screens of the FINE+RARE team as he talks about a certain 50-year-old blended whisky he has created for remarkable spirits curators The Last Drop Distillers.   “It’s just fantastic to come to The Last Drop and find these nuggets of gold and all these wonderful casks of very precious liquid that have phenomenal complexity and flavour,” Scott says with unabashed glee.   Despite his near-50 years in the whisky industry, this is only the second 50-year-old blend Scott has had a hand in producing. Well-aged whisky was, until relatively recently, only a small part of Chivas’ business.   “By the time we’d filled a cask and it had matured to 12 years, most of that went into Chivas 12. Once it reached 21 years old, we put it all into Royal Salute. So, there was very little maturing. But of course, as time goes on, the stocks have been held back and the super-premium part of the inventory has grown.”   Scott joined Chivas Brothers in 1973 and became their fifth Master Blender in 1989. But he would have to wait a further 13 years before a 50-year-old whisky project presented itself. The result was The Royal Salute 50 Year Old, released in 2002 – a dual commemorative bottling for Queen Elizabeth II’s coronation and Royal Salute’s 50th anniversary.   Today he’s talking about his latest 50-year-old creation, The Last Drop’s 22nd release and first in-house whisky: a 50-year-old blended Scotch. After a whole three months as a man of leisure, the “retiree” joined the Sazerac-owned company as their first Master Blender in autumn 2020.   “When I joined in September last year, it was really the beginning of finding out what all these nuggets were within the inventory. Sorting through the very special and remarkable casks and finding out a little bit about what they were and what they did and how we could bring them together.”  Scott explains that everything in the blend started out as either a single malt or a single grain whisky, distilled at different distilleries around Scotland over 50 years ago. “At various stages along the way, blends have been made but then of course the balance has been put into cask and stored away for further maturation. So, what we have is a mixture of some of these malts and grains, all with their own unique characters and flavours, that we bring together at the last moment.”   Tasting the blended whisky alongside Scott is like being escorted on a journey back through time – to an age when a lot of distilleries were doing their own maltings and adding peat to the kiln to get a little smoky flavour.   “To me, blending is all about taking the flavours and then balancing them,” he says. “What you have here on the nose is a tsunami of flavour. But, when you taste it, nothing actually lingers and stays on top.”   Scott encourages tasters to add water to remove the aggression of the alcohol and maximise the release of the aromas and characters. When he is tasting more than 50 samples around a nosing table, this trick is vital to reduce all the whiskies to 20% alcohol and allow the flavours to present themselves.   In the case of The Last Drop 50 Year Old, its mellowness, richness and depth means you don’t necessarily need to cut the 48% dram.    “When we blend, we don’t add something, sniff it and then add a bit more of that. What we do is actually write down the whole formula in its entirety. We then pilot blend it. When we add the last addition, it will change the balance of everything you have already. So, you don’t know the final answer until you add that last part of the formula. And then once you’ve got them all together you can evaluate what you have actually created.”  For Scott, the act of blending and evaluating is an entirely personal thing. “All whisky – grains, blends – are fantastic. They are all different and they all bring their own song to the party. The only reason one is better than other is your own personal experience.”   Scott, for instance, isn’t “a fan” of the smoky Islays. “I don’t think they’re bad,” he adds. “It’s all about personal taste. There’s not a bad whisky in the world.”  The Master Blender talks at length about whiskies having different personality traits that require nurturing and, ultimately, respect.   “If you take a single malt as distillate at birth – that has a flavour package. It’s like you when you’re born – you have a character. If you put that new distillate into a cask, over the years this distillate will react with the oak in the cask and take influences and nuances which will then promote other flavours in the new spirit.  “So as time goes on, the volume actually goes down, the strength goes down, but that flavour package actually intensifies and intensifies and multiplies and multiplies.”   When it comes to age, there is some debate about how old you can go. For Scott, the 50-year-old is undoubtedly a rare beast, but he doesn’t see any reason why you can’t go older and rarer if the whisky has been sufficiently nurtured.   “If the angels didn’t interfere, in a quality cask, you could take it to 60-, 70-, 80 years,” he says. “If you’ve got quality casks, you don’t get that wood influence. You get a little touch of the oak but what you have at the end of the day is this small amount of highly intense, complex flavoured whisky that started as the new distillate and just grew with all the different influences from the oak and the cask whether it is Sherry or Bourbon.”  While there have been scientific advancements during Scott’s career, he says there are still a great many unknowns about the maturation and flavour process, and you get the impression this only adds to the allure for him.   “Because it’s nature, we don’t actually know what’s going on,” he adds. “It’s massively complex and the technical people still don’t know the number of components in Scotch whisky. I think they’re up to about 800 now. Dalmore, Mortlach and Macallan fetch tens of thousands of pounds at auction today – but they likely wouldn’t exist if it wasn’t for an independent bottler. In times of great economic hardship, Gordon & MacPhail provided cash-strapped distilleries with much-needed capital when they secured new-make spirit to mature and bottle as a single malt, rather than a blend. “The world was so focused on blends in the 1970s that to get the financial return on the malts was really challenging,” Gordon & MacPhail’s Director of Prestige Stephen Rankin says. To put that into perspective, a bottle of 35-year-old Macallan from 1937 that would fetch approximately £32,000 in today’s market would sell for a mere £4.54 then. A top-end blend might sell for £2. Rankin says if it wasn’t for his forebears’ patience and foresight, 50-, 60-, and 70-year-old bottlings wouldn’t be available today. “It’s not just matching spirit with oak,” he explains. “It’s actually matching the spirit with the oak and then time and the patience.”   The Gordon & MacPhail name has endured where countless others have not. Today, the fourth generation can pull out samples dating back nine decades from more than 100 distilleries. “It’s that lineage that stands us apart,” Rankin says. “As a company we have had this incredible respect for whisky and depth of relationships forged from 1895.”   “Business was done on the strength of a handshake when my father started the company in the 1940s,” Fred Hamilton Laing – Douglas Laing & Co Chairman and second-generation family member – says. “And so many of our filling programmes still continue today because there was a trust given and a confidence that there would be no abuse of the stock.” If it wasn’t for the “fairly substantial” stocks Laing’s father had built up since the 1950s then the Scottish independent blenders and bottlers might not have survived the 1990s financial crash in Asia Pacific. “All of a sudden our blended business was made very difficult to continue. We were constantly adding to our stocks of grain and malt whisky for these blends, so it was a survival instinct that took us into the single cask business in the year 2000.” This business proved to be “very good” and steadied the ship. Laing says it was with great delight the company was able to come back into the blending business with Big Peat in 2009, much to the dismay of the “crusty old men in the industry”. This launch, looking at younger, slightly more rebellious whisky consumers heralded a new era for the company and brought them full circle. It was the filling programme’s breadth of stock and the relationships with the distilleries that allowed Douglas Laing to carry out the same process for Big Peat and Scallywag into the Scottish Highlands for Timorous Beastie, into the Lowlands with the Epicurean, into the Campbeltown area with the Gauldrons, onto the Island distilleries with Rock Island and introduce the Remarkable Regional Malts. “It’s a busy game,” Laing adds.  Fledgling in comparison, That Boutique-y Whisky Company stormed onto the independent bottling scene in 2012 with their 50cl illustrated bottles. “We are all about throwing fun back into whisky,” Head of Whisky Sam Simmons says. “We take the whisky very seriously, but we don’t take ourselves seriously.” The goal here is simple: curate delicious whiskies you would never see from an official bottling. This disruptive attitude has led to a cult-like following which Simmons readily acknowledges “doesn’t speak to everybody”. The Boutique-y whiskies might originate from around the world, but they are all bottled in the Scottish tradition – bought direct from the distiller or from brokers and other independent bottlers. The retail price is always calculated from the cost of the liquid rather than market value or cost. “The kind of whiskies we want to bottle may not be delicious to everybody, but they are the kind of whiskies that make you say: you got to try this,” Simmons adds. When it comes to bottling exquisite liquids, few ventures are as compelling as “curators of the most remarkable spirits”, The Last Drop Distillers. “I really love the word remarkable,” Managing Director Rebecca Jago says with a smile. “Because it is not saying it is the oldest or the best even, but that it is intrinsically delicious. If I gave you a glass of something from The Last Drop, I would want you to find it as delightful as someone who has been nosing spirits for 50 years.” The company started by Rebecca’s father Tom and his long-term friend James Espey OBE in 2008 is somewhat unique in that it crosses category. The two drinks industry icons initially set out to bottle single malts, but that all changed when they tasted a certain 47-year-old blended Scotch. From that day onwards, the two men – who had previously developed the likes of Johnnie Walker Blue Label and Chivas 18 – broadened their brief to seek out exceptional old parcels of any amazing spirit. By the time the company was sold to Sazerac in 2016, The Last Drop had released seven remarkable liquids and both Espey and Jago’s daughters (Beanie Geraedts-Espey and Rebecca Jago) had joined the business. In addition to being a source of great pride for the two founders, the acquisition also brought new freedoms and opportunities for the team. The US drinks group backing enabled The Last Drop to source stock for immediate release, granted them a greater ability to lay down stock and create their own libraries of future stock, and gave them the opportunity to venture into liquid creation. “I think finding treasure is not just about uncovering it,” Jago says. “It would be disingenuous to suggest that we’re Indiana Jones in Scotland, going and hunting out that barrel that is hidden at the back of the cellar because it is not,” Jago says. As romantic as the image might be, every single barrel of Scotch whisky of any age, of any sort, is known about by HMRC.  “We can talk about some of the lovely discoveries that we have genuinely been party to,” Jago adds. “Going back to the very first release of three unassuming barrels of an old blend. The treasure in that was the liquid inside. It had perhaps been discounted or forgotten about.” Or the “genuine discovery” of a Cognac barrel that had been lying untouched in an outhouse for over 70 years that was happened upon by a family member doing renovation work at the distillery. “I think that is the sort of ultimate Indiana Jones story,” Jago adds, “not by us, but we were fortunate enough to be there and I suppose our story of making the liquid the hero is sufficiently compelling that they are prepared to let us put it in a bottle.” All four bottlers, whether in their infancy or maturity, are bound by a sense of honour and wanting to do right by the liquid. And everyone benefits.   Browse all Scotch whisky or read more Editorial
