Walking into the cooperage at Ch. Smith Haut Lafitte is like stepping back in time, filled with the smell of seasoned wood, an open fire and the same tools that barrel-makers have used for centuries. Few estates have the luxury of an in-house cooper. While producers inevitably work closely with the tonnelleries (barrel-making firms, such as François Frères, Stockinger and more), having an artisan on-site, working alongside the winemaking team to craft casks exclusively for your specific terroir is different. “It’s very important for the precision of the wine,” explains Cellar Master Yann Laudeho.  Florence and Daniel Cathiard, owners of the Pessac-Léognan estate, built a cooperage on-site almost 30 years ago, in 1995, and their current cooper, Yann Dez, has been working here since 2021. The Bordeaux native’s father was a metal worker, and Dez fell into the world of barrel-making entirely by accident – having a friend who was a tonnelier, and a job opening at an opportune moment. Before he knew it, Dez had learnt the trade from some of the best coopers in the country (including one who now makes the barrels at Ch. Margaux), and spending 15 years working under Didier Fesil. Fesil was the Cathiard family’s first cooper back in 1995, who went on to create his own small tonnellerie (Tonnellerie Bordelaise), and has been named the nation’s best “Master Cooper” – twice. Indeed, Fesil is still very involved with the estate, helping choose the wood for barrels and advising on all things oak; and it was Fesil who put Dez forward for the role at Smith Haut Lafitte.  “There are no books,” Dez says, when I ask about the art of barrel-making. “It’s passed on from tonnelier to tonnelier." The first evidence of coopering as a trade dates back to 900BC – with the craft passed down the generations ever since. “I continue the tradition,” Dez says, clearly with a sense of pride in this ancient, artisanal skill. But with the dust, noise and physical labour involved, tonnellerie schools, Dez tells me, are struggling to recruit young people. It’s common for coopers to have issues with their shoulders and ears (from the non-stop hammering) – and Dez himself has broken an elbow.  In theory, the process can be mechanised – but Dez is clear on how important it is to work by hand, and not just to preserve this ancient art. “I hear the nose, I feel the resistance,” he says. Each barrel, he explains, is different – with a slightly different number of staves and slightly different shape, all adapted according to the wood he’s working with. Selecting the right wood is key – “reading” it, he explains, looking at the grain to see where potential weaknesses are, understanding where will take the most pressure and placing each stave accordingly, ensuring not a drop can seep from the finished barrel. “It’s a job that is both physical, and at the same time requires thinking,” says Dez – and this combination is much of its allure for him.  Hearing the way Dez talks about barrels is fascinating; for him, they each have a unique personality. When I ask Dez how he knows he’s made a really good barrel, he shrugs: “On le sent.” (“You feel it.”) As you toast a barrel, he tells me, the scent of the smoke changes, releasing different aromas – something I smell as he works in front of me. Knowing when it’s spent the perfect amount of time over the fire is the secret – and it’s about more than just the smell, it’s a gut instinct that he can’t quite explain.  Smith Haut Lafitte sources oak from a range of forests, and are always trialling wood from different forests, toasts and doing blind tastings, although – after over 25 years – they know what works for their wine, and terroir. Cellar Master Laudeho explains that, for him, Tronçais and Jupilles are the best – “diamonds” that flawlessly complement their site. And that balance is key; the wood works for the wine, not the other way around.  It seems like a lonely job, I comment, hammering away in his tower – but it’s not something that bothers him. “I’m a bit of a perfectionist,” he tells me. Having only himself to depend on, and knowing that he can ensure each barrel meets his exacting standards, suits him. Indeed, he doesn’t even settle for standard tools – making most himself, custom-designed to suit the way he works. He talks me through a specific hammer that he made, and how it allows him to work better and more precisely, the wooden handle almost silken from the hours of use, shaped to his hand.   The lone electronic technology to have earned a place here are noise-cancelling headphones and a Marshall speaker. He’s a musician in his spare time, and an additional perk of working alone is that he gets to spend all day listening to music. “All the barrels I’ve made,” he says, “are made with music.” He avoids anything too modern or electronic, favouring old jazz, with some reggae, ska jazz and funk in the mix, depending on the day. While he doesn’t feel the music he listens to influences his coopering, he suspects his mood does – and music is a big part of that.  Woodwork is much more than a job for Dez. I spy a beautiful chest alongside his speaker, and it’s one that he made. He has a workshop at home too, spending his free time making everything from guitar stands and toys to chandeliers – anything, he says, that isn’t straight, and therefore can’t really be done by a machine.  It’s amazing watching him work – in the same way as coopers have for centuries – with a natural intuition, ease and precision. There’s definitely something musical to it, a craft that has its own rhythm. He makes around 300 barrels a year, and they may not be soloists – but each one contributes their own note to that year’s symphony.  Explore all current listings of Ch. “I can die happy now,” Jon Bonné chuckles to me. The writer spent almost a decade as the wine guy at The San Francisco Chronicle, and is now Managing Editor at Resy, having spent time at Punch, writing for Noble Rot, Decanter and many more in between. His latest book, The New French Wine, was released earlier this year and The New York Times wine critic Eric Asimov dedicated an entire column to singing its praises – something he almost never does.  The hefty, two-part tome has been a long time in the making – almost a decade, in fact. The idea was a frivolous suggestion, casually agreed to over one too many drinks (“unsulphured Gamay in Oakland – as one does”) with his editor in 2014, soon after the publication of his seminal The New California Wine. But what was conceived as part of his quest for “the next thing”, to build on the momentum of his first book, rapidly spiralled.  “It's very hard to see a bigger picture of French wine because it is so overwhelming,” Bonné tells me over Zoom. Initially he’d envisaged a few trips, a project that would take a couple of years – but it “kept growing and growing and growing”.  “There was this much bigger story that I was sort of stumbling into,” the writer says. He gradually realised that there was an “enormous meta transformation” taking place across France – and this is what the book wrestles with. As he writes in the book’s introduction, “I imagined the new French wine would be about the undiscovered country – the cracks between known places.” But as he soon discovered, the new French wine was everywhere – and it took him nine years to piece it all together.   The work is split into two separate books – The Narrative and The Producers, the former the story behind the reference guide that forms the latter. The Narrative is a deep dive into the face of France and its winegrowing today, broken down by region, with break-out essays on topics such as natural wine, farming and the appellation system. It’s a rich tapestry of stories, interjected with the frank and striking photography of Susannah Ireland and occasional illustrated map by Francesco Bongiorni, reminiscent of Art Deco postcards.  For Bonné, the “new France” is about postmodernism, about “wilful rejections of the b******t of the past”. It’s about a (re)focus on site, about producers seizing their destiny and hunting for a more sustainable approach – in the vineyard, winery and beyond – although it’s far from that simple. “To understand French wine and to love it, you simply have to embrace its messy, self-contradictory, and, yes, complicated postmodern reality,” he writes. He points to Muscadet and Beaujolais as two of the most exciting and representative regions of this movement – both having entirely reinvented themselves within a generation. Producers here, he tells me, are “doing the work and focusing on terroir and technique and farming”, while Champagne “has completely transformed its vision of what its wine should be”.  Change is most importantly, however, “an inclusive force” – and looking at who did (and didn’t) make it into The Producers, Bonné’s definitive gazetteer of the nation’s movers and shakers, shines a light on this. It’s not a list of the vignerons he loves, it’s a pain-staking selection of those he deems significant and meaningful in the context of the movement – encompassing both more traditional names and those on the fringes. Take the Bordeaux chapter; you’ll find Pétrus, Lafleur and Pontet-Canet, as well as many less conventional, smaller and often natural-leaning properties such as Clos 19 Bis or Ch. Julia – with “Benchmarks” and the more up-and-coming “Names to Know” highlighted.  It’s fascinating – and fun – to see these two, seemingly opposing strands of France’s wine scene woven together. When I queried the inclusion of these elder statesmen of French wine, he highlighted how, for him, Pontet-Canet perfectly exemplifies the change in France today, with the forward-thinking Tesseron family handing the keys to previous cellar master Jean-Michel Comme to do “radical, radical s**t”.  Bonné deliberately chooses to champion those who have revved the engine of broader revolution – and those who reflect that revolution’s values. When it comes to Domaine de la Romanée-Conti, for example, he describes how they “upheld the moral pillars of Burgundy and winemaking” and “use their power for good”; whereas one top Pauillac estate he vehemently tells me is “perpetuating the worst practices of the Bordeaux trade”. For him, “wine is a consumable” and, as 21st-century consumers, “people have a right to explore the values of producers”.   While Bonné certainly likes natural wine – and many of the movement’s figureheads feature in the book, he is far from an evangelist. When he first started thinking about the book, natural wine was different; “It hadn’t quite catalysed into this very specific cultural beast,” he says, a cultural beast born in Hackney, Bushwick or Paris’s 11th. He talks about the movement’s “sense of tragic fashion” and how, with its clique-y nature, it has “baked in its own expiration date”. There were, he tells me, producers that didn’t make the cut – those who act as a “cautionary tale” for natural wine. “There are wines that can be delicate to being transported. And then there are wines that are just f***ed up at the source,” he says frankly.   His outlook is broadly positive for France, the nation’s ongoing revolution and its vignerons, but the book also acts as a call to arms of sorts, for: “The enforcers of the old ways will be forced to adapt, or they will perish,” he writes.  It’s not a perfect book. With a work of this size (over 860 pages and 600,000 words), it is almost inevitably slightly out of date by the time it is printed – especially with the pace of change today. Lafleur’s entry, for example, talks of Acte but not Les Perrières. I’d also have loved to have captions for each of Susannah Ireland’s images, knowing where – and of whom – they were taken. But these are quibbles.   I can’t pretend to be unbiased. Bonné is one of my favourite wine writers. There’s a lightness to his phrasing, with dry humour and a palate that I tend to identify with – although I’d argue he’s become a little more funk-friendly over the years. His writing is intelligent without being arduous. Perhaps it’s because, like Andrew Jefford, he was and is a journalist first. What really fills his writing is a sense of joy, of almost gluttony – it’s still filled with the excitement that so many wine writers seem to lose, as they tire of bottle after bottle of exceptional wine. He’s still easily absorbed by the stories that make each one different. For me, he doesn’t fit neatly into the critic box, even though it’s a term he uses to describe himself repeatedly in our conversation. “The notion of a critic has devolved to a place where you are simply handing out numbers,” he explains, but to him his work is about “criticism at a deeper level”. It’s about “being able to dive into the culture and come away with the insights and interpretation, and explain why certain wines really do matter”.  And it is this that makes The New French Wine stand apart. It isn’t just a wine book; wine is the lens through which Bonné observes a broader cultural shift. Whether you agree with everything he says or not, it’s a joy to read, hold and look at. It’s a book that will prompt conversation, prompt you to uncork bottles, prompt you to consider quite how complicated – and endlessly fascinating – France’s wine scene is. Serge Valentin has been one of the few truly independent voices in the Scotch whisky world since the early 2000s. For two decades and counting, the Alsace-native has published his tasting notes and scores to an astoundingly large and loyal audience with his characteristically good humour and impartiality in what can be a deafening echo chamber.   Despite being one of the most well-respected authorities in the industry, Valentin has always written about whisky in his spare time, very much considering it a pastime that he dabbles in for fun. This is somewhat of a surprise, given the many people who part with thousands of pounds based on his views alone.  “Contrary to what many believe, I’ve never been a pro and have never actually worked in whisky,” the jaunty Valentin is quick to tell me. “It is all a kind of super-hobby to me and if you ever see me doing gigs, for example at whisky festivals, it is always for free, for fun and for friends.”   Valentin’s “proper work”, as he calls it, is in advertising and marketing, where he owns two agencies which employ around 2,000 people. These agencies, he says glibly, are “supposed to pay for my whiskies…luckily, they do”. It was a very different landscape when Valentin started writing about Scotch in 2002. Single malts had been marketed for 30-plus years but there wasn’t the seemingly insatiable demand and record-breaking prices that are commonplace today. It all began when Valentin, armed with bottles of his favourite Old Clynelish and Brora, sat down and shared his musings on his aptly named website WhiskyFun. This wasn’t a vanity project or a vehicle for freebies, this was a man writing about the whiskies he loved, just because he wanted to. From humble beginnings, WhiskyFun has become one of the most well-respected hubs for commentary on Scotch. Valentin follows a 100-point scoring system, like some of the great critics in the world of wine. For Valentin, however, 80/100 is a good score. His methodology is largely unchanged. He will spend an average of 30 minutes tasting a whisky (he does, on occasion, score rums and other spirits) – this can increase up to an hour if it’s a “good one” and take nearer 10 minutes if it is a “bad one”. He always compares several similar spirits, almost always from the same distillery, and never scores “out of the blue”. He tastes “alone, using the same parameters” (place, time of day, glassware, water etc.) and always writes as he tries, and then publishes once a day.  His write-ups are always short, honest, and unmistakably him. After all these years, it’s dumbfounding that he has the time or inclination to produce the near-constant stream of reviews that appear on his website.    It’s fascinating to see which liquids he scores – and, sometimes more intriguingly, the ones he doesn’t. “The choices rather depend on what I get and what I source, but my sample library is much larger than my tasting capacity,” he explains.   This all started as a passion project for Valentin and it’s abundantly clear that that fire burns just as bright today. He never takes himself too seriously and is evidently ill at ease with any comparison between himself and the greatly respected critics in the world of wine.    This is, in part, because the role of a critic in spirits is nowhere near as established as it is in wine. There are leading voices in the Scotch whisky world who undoubtedly carry considerable clout, but they aren’t critics in the traditional sense. While they might be prolific in their output and have seemingly healthy book retainers, they rarely score spirits and if they do, their tasting notes will be almost entirely positive (often because they are in a producer’s employ). The closest the spirits world has to a Robert Parker or Jancis Robinson MW is probably Valentin – although, he wouldn’t agree.   “I would say the roles are more and more the same in wine and spirits,” Valentin says, “even if there are fewer actual ‘critics’ in spirits. But it is coming in whisky.”  Valentin does feel there is a need for scores in collectable spirits, as – like wine – there isn’t always the opportunity for people to try before they buy. But the issue is not black and white, as is true of many things Valentin and I discuss.   “I see that scores [in whisky] become more like stock market recommendations these days,” he says.“I’m not too happy about that but that wouldn’t be the case if spirits, especially whisky, had remained a reasonably priced commodity,” he says, before adding: “But the cardinal sins are what they are.” It’s clear whisky drinkers respect Valentin’s voice, as they flock to his site in droves. What’s less clear, however – as an outsider looking in – is how producers feel about Valentin’s refusal to kowtow and sugar-coat his reviews.  “Producers have never quite known how to deal with independent voices,” he explains. “In general, they prefer influencers that they can pay and control, even if their audiences are smaller and less ‘on target’,” he adds, “for which I can’t blame them. Fortunately,” he continues, “not all distillers are the same. Some corporations are smarter than others and that often depends on the people within.”   When asked why he thinks people return to his site, which doesn’t have any of the bells and whistles you might expect from an ad man and is as no-frills today as it was two decades ago, Valentin says, as self-deprecatingly as ever: “I’m not really aware of everything that’s happening in the reviewing landscape, I have to say. If indeed people keep coming back to my assessment, that’s partly, I believe, because I started early and simply because they trust me. Trust is number one.”   In many ways, Valentin’s website is a collection. It’s a receptacle for his innermost thoughts and feelings about the things that matter most to him. Valentin has always been collector at heart. With an interest in stamps from childhood, he then graduated onto watches, wine and then whisky. The father of three has a broad and eclectic range of interests, including music (“all kinds”), advertising, motorcycling, wine, watches, food and travel which he has nurtured and indulged. Throughout the years, Valentin has had a front-row seat to the evolutions within these industries and the so-called art of collecting.   “Old-school collectors used to buy what they liked, never what was meant to see its value rise,” he says. “In the old days, you had to travel, to make phone calls, to go to festivals etc. Today,” he says somewhat ruefully, “you can buy anything, as long as you’ve got the money.” Valentin was ahead of the curve when he made the choice many years ago to buy as many different Old Clynelish and Brora single malts as he could, simply because they were his favourites. At the time, and up until 2005 to 2010, all whiskies – even the rarest – remained relatively cheap. After 2010, it was silly season and whiskies you could previously source were nigh on impossible to find or prohibitively expensive for some.  Valentin’s favourite whiskies have become some of the most desirable on the secondary market. Old Clynelish, produced before the distillery was rechristened Brora, have gained a huge following globally as people were charmed by the story and the characterful liquid the two distilleries produced. Now Brora is set to be re-opened, these single malts will only become more valuable. While his collection is no-doubt impressive – exact bottlings are not disclosed – there are some unicorns which still elude Valentin.   “Rather bizarrely and inexplicably, I prefer fatter spirits and fresher wines,” Valentin says, “in both cases with as little straight oak influence as possible. So, fat distillates, such as some coastal malts, some Jamaican rums etc. In wine, that would be the bright whites, Jura, Savoie, Rueda, Pacherenc, Irouleguy, Alsace, Wachau and Andalusia.”    “I know oak is crucial,” he adds, “you just shouldn’t feel it as such, according to my personal taste. But I insist, that’s personal.” Oak is a topic Valentin returns to several times. He feels it is the low-hanging fruit when it comes to innovation in the Scotch whisky industry.   “Sure, there are a few innovations around the casks,” he says, “but all makers use more or less the same.” The woods used are usually more active, which allows producers to sell much younger whisky for a good price while widening the ranges at the same time, he says.   “I’m not saying that’s bad,” he quickly adds, “but not many people are talking about the distilling regimes, the stills and so on, which was the number one topic 20 years ago.” He continues: “It is now all about wood. But, when we talk about wood that includes their flavouring with other spirits, wines, or even whiskies from other distilleries such as some peated ones, which is the latest trend, to peat single malts by doing some in-cask blending rather than bother with brewing and distilling some peated malt. “So, cutting corners for sure but on the other hand, I believe the average quality has risen pretty sharply. So, all remains good and well…”  This seems to be Valentin’s baseline. The whisky world might have changed but he believes it is the same at its core. There is an increase in branding and marketing (which is likely a source of joy and consternation for an ad man), there are more malts, and for the past five or six years, more distilleries from almost all countries.   “I’m not bored yet,” he says in his frank way, “and in general, whisky has got better on average, even if there are fewer utter glories and fewer total duds.”  If a man with Valentin’s reputation of no-holds-barred honesty is broadly happy, then we probably all should be too.   Browse all Scotch whisky  or  read more Editorial

Andrew Jefford isn’t like other wine writers. Browse his Instagram account and you’ll find not a bottle in sight. Check his Twitter and you’ll find a steady, quiet stream of haiku – or, as he prefers to describe them, “short texts”. These feeds are – like Jefford –gently honest; absent of ego, flash and fanfare. His prose is poised and purposeful, each word carefully considered yet never weighed down by pointed effort. He is a rarity in the world of wine: a writer whose (main) topic happens to be wine.  “I was always a huge reader. It always meant more to me than anything else,” Jefford tells me, thinking back to his childhood. But wine was omnipresent. As the son of a priest, it was a part of family life, consumed “on high days and holidays”.   “I remember first tasting Champagne with my brother, at the age of 10 or 11,” he says. “It was the first tasting note we agreed on: it tasted like vomit. Things got better from then on, happily.” The slight, wiry wine writer smiles, seeming almost sheepish about the wines that he’s since enjoyed.  Aged 16, Jefford decided to start making wine – brewing up grape juice concentrate and whatever else he could find– to supplement supplies at Sunday lunch. The transformative effects of fermentation hooked him – but it was the concept of terroir that reeled him fully in.  He was working at a local hospital, but after his shift – armed with The Penguin Book of Wines and André Simon’s A Wine Primer – he’d venture out to browse the shelves of “French Wine Farmers”, a wine shop in Norwich. He vividly recalls taking home a bottle of Chianti and being struck by the magic of travelling through a glass. “That’s full of wine. And every drop in there came from a vine in Tuscany. I’m drinking Tuscany!” he recalls thinking.“ And I’ve still not got over that. It’s amazing.”  Wine took a back seat when he set off to study English at the University of Reading, before embarking on both a Masters and PhD. The lure of words led him into publishing – a background which, along with his academic approach, defines his writing today. He spent four years “editing mediocre copy into something readable” – but eventually had had enough, and leapt at the chance to write a book on Port.  From there, he wrote articles for Margaret Rand in Wine Magazine, then Decanter, where he’s now a Contributing Editor and his monthly column is the stuff of legend. He was, for a number of years,The Evening Standard’s drinks writer, penned features for The Financial Times and is a regular in The World of Fine Wine. He’s authored several books – including the deservedly totemic The New France. Published in 2002, it looked beyond Burgundy and Bordeaux, shining a light on the nation’s varied wine scene at a moment when it was going through a revolution. If that wasn’t enough, he’s dabbled in radio, presenting for BBC Radio Three and Four.   While wine might be his mainstay, he’s written extensively on whisky and other spirits (including his respected book on Islay, Peat Smoke and Spirit), as well as travel and perfume. But writing, rather than any particular topic, is his real trade. His editorial experience has been key: his prose is intelligent, considered and a masterclass in eloquent economy – something that he finds all too often lacking elsewhere.   Two of Jefford's most famous books: The New France (2002) and Peat Smoke and Spirit (2004) “One of the problems is that a lot of [wine writing] is online, so there aren’t space constraints,” he decries. “[Wine writing] tends to attract quite large egos. They do write three times more than they need to – because they think it’s all wonderful.” It’s perhaps the lack of ego in Jefford’s writing that sets it apart. He seems to approach any topic unbiased and open – still with the wide-eyed joy of that first bottle of Chianti. Wine remains, to him, “dead exciting”.   “It’s a great shame that fairly early on the rest of the journalistic world decided that wine was a ghetto,” Jefford laments. “It embraced wine with gusto initially – probably in the 1990s – then it all got very boring once we passed 2000 and they just asked everybody to offer recommendations and that’s it. Newspapers are no longer a great school for wine writing in the way that they once were.” It is an industry, he feels, sorely in need of imagination. “There’s such a weight of detail to communicate that people never get their head above the waves of the detail.” And that detail, the intricacies of wine – or “its enormous apparatus of geekdom” – are the challenge. He hopes that his latest book, Drinking with the Valkyries – a collection of his work from the last 15 years, “could climb out of the wine ghetto – to anybody who enjoys language, enjoys storytelling, enjoys the interrelation of place and flavour that wine can offer”.  But, by his own admission, wine is “never going to be a mass market popular subject”. While the industry was long obsessed with finding its own “Jamie Oliver” – someone to bring wine to the masses, food is an essential part of life – “whereas wine need be a part of nobody’s life”.   Wine has, undoubtedly, come a long way – “vastly democratised” – but he worries about the “top end of things”, where wine has become so exclusive as to be “almost a plutocracy”. Wine criticism, for him, is intricately linked to the category’s self-imposed segregation, with “its relentless focus on points, excellence and things being better than other things – hierarchy, rather than difference”.  He’s long been vocal about scoring, feeling like Hugh Johnson that – although they may be of practical use to consumers, who undoubtedly want them – they are “philosophically untenable” and “disempowering”.  “You’re being misled to some extent if you think the 96-point wine is always better than the 94-point wine. It’s miles more complicated than that,” says Jefford, who scores wines reluctantly.“ And very often the 89-point wine can be better than either the 96- or 94-point wine.” His advice to wine drinkers is simple: “Trust your palate.”  Despite his impressive resume and effortless intellect, Jefford’s modesty shines through in our conversation – as we dash from the dangers of climate change (“Misery throughout the Third World – but the Bordelais and Bourguignons are raking it in”) to a fascinating co-fermented 15-variety blend from a Lirac estate (Ch. de Montfaucon’s Vin de Mr le Baron). And while the 66-year-old might be softly pensive in the written – and spoken – word, there’s such energy to the man himself.  He’s invariably described as a wine thinker, a philosopher-cum-writer, as well as – of course – a poet; but it’s impossible to pigeon-hole Jefford, his ideas, or his voice.  Andrew Jefford’s book Drinking with the Valkyries, published by Académie du Vin Library, is out now.

Oak barrels have been used in winemaking for thousands of years. While initially their purpose was simply as a holding vessel, today it is much more than this. As we have learnt about wine production at a molecular level, we have discovered the unique interaction between oak and wine – adding flavour, textural complexity and increased ageing potential. These intrinsic qualities have seen oak at the forefront of fine wine’s greatest success stories – but also some of its greatest failures. The use of oak to improve a wine requires great skill and finding that balance has shaped the modern history of fine wine.  What is rather beautiful about winemaking, particularly in fine wine circles, is that despite the input from developments in science and technology, production remains an artisan craft, relying both on tradition and technology. The barrel-maker is a perfect example of this partnership and no one understands this better than François Frères. This lauded Burgundy cooper’s ties to the world’s greatest wines make it one of a very small number that have lived through the development and fashions within fine wine.  Today, business has never been better for François Frères; they produce 30,000 barrels a year and export to every major wine region in the world. The secret to the François Frères barrels historically, Gigandet believes, is their consistency, while the all-important signature toasting is paramount. To keep up with the ever-growing world of fine wine, François Frères produces tailor-made barrels that fit the varying climates and varying styles of each winemaker, meeting the standards set by today’s precision-led winemaking. Despite the growth of the business in recent years, François Frères still remains intrinsically linked to its homeland in Burgundy and the specific microclimate of Saint-Romain that is so important for the seasoning of their oak – another key factor behind the company’s success. “The microclimate of Saint-Romain, in a windy and pollution-free environment is ideal for the seasoning and drying of the oak. This oxidation of phenolic compounds under the influence of fungi, releases enzymes that hydrolyse the phenolic compounds, reducing the wood’s astringency, producing oak of the finest quality for wine production,” Gigandet tells me. The art of the cooper is much more than just sawing and toasting – it’s about sourcing, traceability, control of drying time and heating, hygiene, temperature control, sorting and more. With increased knowledge, the quality of the barrels, like that of the wines, has greatly improved. Even just a few years ago, Gigandet admits that in colder Burgundy vintages, sometimes their barrels jarred with the wine – they “brought too much tension and could sometimes seem too austere”. But now they have a better understanding of the qualities their barrels can bring to Burgundy: “François Frères barrels remain attractive to winemakers because they are great at retaining freshness and minerality.” Perhaps most importantly, François Frères wants its barrels to amplify a wine’s intrinsic qualities. “It wants to accentuate the beautiful tannic structure of a wine, contribute to its flavour but without excess of sweetness from the toasting, as well as amplifying the wine's tension and minerality, helping retain its freshness and its fruit,” Gigandet says. As technology has developed, so has François Frères. It is what Gigandet aptly calls “the evolution of taste” – “the cask has evolved considerably over the last few decades along with the quality of the wines. Today, the barrel is much more specific, manufacturing almost tailor-made barrels for each customer’s needs.” The business was founded by Joseph François in the early 1900s, never imagining that being a cooper would become a full-time job. Back then, Gigandet reminds us, “It took several trades to live.” But the next generation, Robert and Henri François, saw the demand for oak casks rise, at that time mainly used to transport wines. They took the operation full-time, creating the François Frères brand in 1942. In those days, as Gigandet points out, “The tradition of maturing wines in barrels was reserved only for the very top red and white wines of Burgundy and the great Bordeaux châeaux.” Even within these regions, barrels were a luxury, re-used year after year given their expense, therefore keeping the demand for new barrels low. By the 1960s the brothers were met by the development of stainless steel and plastic containers. The barrel quickly lost it supremacy as the preferred vessel for transportation and demand plummeted. It was only the top producers that helped keep the cooperage going. By the 1970s François Frères was producing barrels for one of the world’s most famous estates, Domaine de la Romanée-Conti – a partnership that would be instrumental in the continuation of the business through a difficult period. The next generation – Robert's son, Jean – was confronted by the economic downturn of the early 1970s and turned to export to save the family business. Fortuitously at this time, oenologists in the United States started to highlight how ageing wines in new oak barrels brought complementary flavours and complexity to the wines. In the 1980s, the French market caught onto the idea and both export and domestic markets grew. The oak barrel was entering an era where it would become the star of the show – and a must for all top producers. François Frères’s reputation for working with the best saw it perfectly placed to capitalise on this new-found love for the barrel. But according to Gigandet, it wasn’t just the fashion of using new oak in the 1980s and ’90s that saw such a huge increase in demand. This trend emerged just as wine exports exploded. What he calls “the democratisation of wine” saw the world of wine suddenly open up to the middle classes – and this increase in sales saw an ever-increasing need to maintain quality and improve consistency. Such demand prompted and funded a better scientific and technological understanding of wine production. More importantly for François Frères, it fuelled the need for a better understanding of what barrel-ageing does to wine – and why. It was already clear that contact with new oak changed wine profoundly. Most obviously the aromas and flavours of the wine develop, becoming more complex. These aromas and flavours are formed during the toasting of the barrels. “It is this toasting of the barrel that remains the signature of the cooper,” explains Gigandet. But the oak didn’t just impact the flavour, they came to understand that, being porous, oak allowed the wine to undergo “controlled oxygenation”. The exchange of air through the oak staves, in particular for red wines, helps stabilise the colour and polymerise the tannins. This polymerisation not only softens the wine, but brings a textural complexity, a millefeuille layering of mouth-feel brought about by the linking of long tannin chains, encouraged by the micro-oxygenation process that the wine goes through when aged in oak barrel. “François Frères barrels are ageing tools, which contribute to the textural improvement of wines, when used wisely,” Gigandet explains. As the wine world’s love of oak grew, François Frères’ main export customers went from little-known names to pioneers in their respective regions – with Robert Mondavi in the US, Angelo Gaja in Italy, Nicolas Catena in Argentina and Australia’s Rosemount winery. Each of these producers further cemented the cooper’s reputation, representing the very pinnacle of oak barrel production. Of course, like all fashions, the oak craze of the ’90s saw some extreme uses – 200% new oak ageing or an over-reliance on oak to provide flavour to wines that lacked the natural concentration to carry it. This saw many producers and consumers react strongly against its presence in wine at all. Even Gigandet admits that there are wines with “excess woodiness” to their detriment. Today, the barrel also has to compete with new trends in wine maturation – concrete eggs and clay amphorae, for instance. But while these new vessels have captured the imagination of the world’s top winemakers, it is not necessarily at the expense of the barrel. “The barrel has an important oenological role in the development of wines from certain grape varieties,” states Gigandet – notably Cabernet Sauvignon, Merlot, Syrah and Pinot Noir. But he also outlines how different ageing vessels combined can also benefit a wine’s potential for complexity. This is certainly the case amongst some leading producers in Bordeaux and Burgundy that are using both oak barrels and alternative ageing vessels. Coopers like François Frères have weathered the changing relationship wine has had with the barrel; with shifting views of critics and drinkers over the last century. Fortunately for fine wine lovers, there’s little sign of oak fading into the background. Oak remains a vital ingredient in many of the world’s greatest wines, adding to its flavour, textural complexity and – of course – ageing potential. Arvine: Switzerland’s hidden treasure Berry colour: white
 Arvine, pearl of the Alps The ultimate Swiss grape variety, Arvine can produce captivating, complex wines of international stature, from dry to sweet. It is native to the Valais, southern Switzerland, where it was mentioned for the first time in 1602. Since the late 19th century, it has often been called Petite Arvine to distinguish it from Grosse Arvine, a completely different and rare local variety. I have not so far been able to uncover Arvine’s parents by DNA testing. It is often said that Arvine was introduced to Switzerland by the Romans. Its name allegedly derived from helvola, a grape variety mentioned by Cato the Elder. I refute this claim for two very simple reasons: firstly, it is impossible to establish botanical identity between the vague descriptions of Latin authors and modern varieties, and secondly, helvola grapes were black-berried. I think instead that its name comes from the local dialect arvena, itself probably derived from the Latin advena, meaning ‘just arrived’. This name could have been given to the variety shortly after its birth (or arrival?) in the Valais. It is a late-ripening variety, with small berries and compact, small bunches. It is quite productive, but prone to wind damage and susceptible to fungal diseases. Arvine covers 218 hectares (539 acres), almost exclusively in the Valais, representing only 1.48% of the country’s vine-bearing area. It produces complex, lively wines that can age well, with aromas of citrus and rhubarb, and a firm structure, as well as a characteristic salinity on the finish. Champions of Arvine In the Valais, several outstanding producers make excellent varietal Arvine wines. For dry wines, I would recommend Cave Benoît Dorsaz in Fully, Valentina Andrei in Saillon, Didier Joris in Chamoson, Cave de l’Orpailleur in Uvrier and Domaine des Muses in Granges, among many others. For the sweet wines, produced from grapes that are naturally left to shrivel on the vine, the undisputed champion is Marie-Thérèse Chappaz in Fully. From her biodynamic vineyards, this icon of Swiss winegrowers crafts some of the best sweet wines in the world, especially from Arvine. Her Petite Arvine Grain Noble is highly sought after, and her otherworldly Arvine Grain par Grain, made exclusively from botrytised berries harvested by hand, berry by berry, is almost impossible to find. Arvine has rarely been planted outside Switzerland. In Italy, it was introduced to the neighbouring Aosta Valley in 1970. In 1992, Angelo Gaja, one of Italy’s most famous wine producers, planted 0.36 hectares in Serralunga (Piedmonte). The result was a disaster, in his words, mainly because of problems with coulure and wind damage. In France, some vine parcels exist in the Languedoc and in the Rhône Valley, where charismatic winemaker Michel Chapoutier planted half a hectare in Tain-l’Hermitage, but he was not convinced by the results and has now abandoned the experiment. Outside Europe, it is produced only in Mendocino, California, by one adventurous producer, Ernest Vineyards, which makes a varietal wine under the Edaphos label.

Areni: Armenia’s national treasure Berry colour: BLACK 
History in a bottle Areni is the most important red variety in Armenia. It most likely comes from the village of Areni in Vayots Dzor, at the southeastern end of the county, where the world’s oldest cellar (4000 BC) was discovered in a cave in 2011. Interestingly, the grape remains found at the bottom of the old karas (the traditional clay jars) buried in the cave look very similar to the pips of the modern Areni variety. DNA profiling has failed to identify Areni’s parents, making it an orphan Armenian variety, but it has shown that at least two distinct varieties share the name Areni: Areni Sev (sev means black), the ‘true’ one that has historically been grown in Vayots Dzor, and Areni Seyrak (seyrak means loose, referring to the bunches), sporadically found among Areni Sev vines in old mixed vineyards. Areni Sev is a late-ripening variety with oblong, sometimes ovate, thick-skinned berries. The bunches are medium-sized and dense. It shows good resistance to frost, which means it can be cultivated at high elevations (up to 1,600 metres in Armenia). It is moderately resistant to powdery mildew and susceptible to downy mildew. Areni is exclusively cultivated in Armenia, where it has traditionally been used to make high-quality, age-worthy wines with complex aromas of violets, wisteria, cherries and blackberries, silky tannins and refreshing acidity. Champions of Areni After my first visit to Areni village in 2003, and despite the rudimentary winemaking at the only local winery (Areni Winery, now Hin Winery), I was convinced that Areni was among the most promising grape varieties in the world. In 2012, I met Zorik Gharibian in Izmir (Turkey) at the European Wine Bloggers’ Conference. I was much impressed by his 2010 Karasi Areni Noir, Zorah Wines’ very first vintage after 10 years of trial and error. We became friends and I selfishly helped him find an importer in Switzerland, in order to secure my own supply of his wines, including the mind-blowing high-end cuvée Yeraz. Since then, Zorik and his wife Yeraz have relentlessly promoted Armenian wines all over the world, and Zorah Wines has become one of Armenia’s most respected flagships. Their wines, sourced from ungrafted vineyards between 1,300 and 1,600 metres altitude are partly made in karas, traditional clay jars partly buried underground, ‘cousins’ of the Georgian qvevri. The sad thing is that Armenian-born Eduardo Eurnekian, one of the wealthiest people in Argentina and owner of several airports, including that of Yerevan in Armenia, has founded a winery named Karas Wines, despite not using any karas in the winemaking process. In 2018, judges granted him the exclusive usage of the name Karas, disregarding 6,000 years of shared tradition. Zorik Gharibian has been determinedly fighting against this unfair judgement and he plans to appeal to the country’s Supreme Court. I strongly support him. And I predict that Armenia may well be the ‘next big thing’ in the wine world. Dr José Vouillamoz
 Kydonitsa: Rebirth of an extremely rare grape variety Berry colour: WHITE Rescued in the nick of time Kydonitsa is a survivor, an almost forgotten variety from Lakonía (Laconia) in the southern Pelopónnisos (Peloponnese) in Greece. According to local belief, it was widely cultivated in the medieval period when Lakonía formed part of the Byzantine Empire. It then flourished under brief periods of Venetian rule, before it was threatened with extinction under Ottoman rule, as a result of the bans on alcohol consumption. It had almost disappeared when it was saved from extinction by Yiannis Vatistas and Yorgos Tsimbidi (Monemvasia Winery) in the late 1990s. DNA profiling has not revealed any match or parentage with any other variety, making it a Greek orphan. The medium-sized bunches are relatively loose and elongated. The berries are small and turn golden yellow when ripe. In Greek, the word kυδωνίτσα (kydonitsa) means ‘little quince’, referring to the aroma of both the berry and the wine. The wine also shows notes of lemon, grapefruit, bergamot and mirabelle plum, as well as aromatic herbs. It is elegant, creamy, with crisp acidity and a slightly bitter, orange-peel finish, with a hint of iodine. Kydonitsa is grown exclusively in Lakonía, on the east coast of the Pelopónnisos, near the island of Monemvasia. Champions of Kydonitsa Yorgos Tsimbidi is a visionary. In 1997, while most wineries in the Pelopónnisos were busy planting so-called international grape varieties, he founded Monemvasia Winery in order to revive the historical Malvasia wine in its birthplace. The name Malvasia has been given to a wide range of genetically distinct white-, pink-, grey- and black-skinned varieties which are all particularly well suited to the production of sweet wines. The name is purported to be a corruption of Monemvasia, which means ‘single entrance’ and is the name of a small port situated on a rocky spur in Lakonía. It has been famous since ancient times for its sweet wine made from sun-dried grapes. The earliest mention of the sweet wines of Monemvasia dates back to 1214 in Éfesos (Ephesus, today in Turkey), and in 1278 the Venetians were already importing vinum de Malvasias. The exact identities of the grape varieties making up this sweet wine are still unknown, but Kydonitsa and the appropriately named Monemvasia were probably part of the blend. This is what drove Yorgos Tsimbidi to put all his time and energy into rescuing them, carrying out countless on-farm trials since 1997. He now produces dry varietal wines, as well as the sweet ‘Monemvasia – Malvasia’, a blend of Monemvasia, Kydonitsa, Assyrtiko and Asproudi grapes, dried for approximately two weeks under the sun, in order to revive the ancient tradition. Today, Yorgos runs the winery with his wife Elli and their daughters Marialena, Anastasia and Artemis. I was able to taste a mini-vertical of Kydonitsa during my visit in 2016, which convinced me of the exceptional quality and ageing potential of this resurrected variety. And the rest of the portfolio convinced me that Monemvasia Winery is one of the best in mainland Greece. Dr José Vouillamoz

 Baga: Northern Portuguese red with a simple name and a complex character Berry colour: black 
The rehabilitation of Baga The meaning of Baga may be simple (berry) but the variety is far from it. When it is good, it is breathtakingly beautiful and capable of long ageing. When it is abused, it is acid, mean and lean, with tough tannins. It requires commitment from growers and wine lovers. While it may have originated in Portugal's Dão region, it has found its home in neighbouring Bairrada, where it is the dominant red variety. In 2017 there were 8,258 hectares (20,406 acres), 4% of Portugal’s vineyard area. It’s found mainly in Bairrada but also in Dão, although there it is not authorised in DOP wines. Baga vines are also planted, though far less numerously, in Lisboa, the Tejo and the Douro. The cool, wet, Atlantic-influenced climate of Bairrada is particularly inconvenient for a late-ripening variety with thin skins and prone to botrytis. If its vigour and productivity are not controlled by careful viticulture or the natural balance achieved by older vines in poor soils, there is increased risk of under-ripeness or rot when the September rains arrive. Despite all this, those whose hearts have been captured by the variety have shown it to be as bewitching as Pinot Noir, and as hauntingly complex and long-lived as Nebbiolo. Champions of Baga The variety allows itself to be made in many styles, influenced strongly by the soil (limestone-clay and granite are both prized), the age of the vines and, not least, by the personalities of the winegrowers and their choices in the winery. The most restlessly experimental and determined is Luís Pato, who was prominent among a small group of quality-minded winegrowers who dragged Baga into the spotlight for fine wine after it had languished for so long as a source of bulk reds churned out by the state-controlled co-ops and négociants for much of the 20th century. While there are today, thankfully, too many good winegrowers to mention by name, the Baga Friends display the variety’s wonderful diversity: from the powerful styles aged in oak that become increasingly complex and perfumed with age that are produced by, for example, Luís Pato, Mário Sérgio Alves Nuno at Quinta das Bageiras, François Chasans at Quinta da Vacariça and Paulo Sousa at Sidónio de Sousa; to the lightly stepping, red-fruited, fresh and scented beauties of Filipa Pato and Douro incomer Dirk Niepoort at Quinta de Baixo. Baga can also make very good sparkling wines. Bussaco Palace Hotel has an astonishing collection of very old vintages, blending Baga from Bairrada with Touriga Nacional from Dão. Julia Harding MW 
Kisi: Recently resurrected and scented Georgian white Berry colour: WHITE The resurrection of Kisi Maybe it’s because thin-skinned Kisi is difficult to grow and sensitive to the climate that it was on the verge of extinction at the end of the 20th century, when David Maisuradze made a wine that put the variety firmly back in the spotlight. The highly respected winemaker, then with Telavi Wine Cellar, managed to find just four tonnes of the variety to make a wine, fermented in a stainless-steel tank, that stunned wine lovers with its pure, floral aromas and deep fruit flavours of citrus and pear, richly fruited but dry. This variety didn’t stand much chance in the Soviet era when only a very limited number of varieties were permitted in the interests of volume rather than quality. Kisi was not among them and it survived in family vineyards in just three villages in its homeland of Kakheti, in the Alazani Valley in eastern Georgia in the shadow of the Caucasus Mountains: mainly in Maghraani but also in Argokhi and Pichkhovani. There are currently about 500 hectares (1,235 acres) of Kisi in Georgia, all still in this region. There is currently no DNA evidence to reveal the variety’s parentage but it is not related to Mtsvane Kakhuri or Rkatsiteli, the latter a Soviet favourite. Champions of Kisi In Georgia, ‘classic’ white wines are made in a way familiar to most 21st-century wine drinkers – fermented without the skins, typically in temperature-controlled tanks, occasionally fermented or aged in oak. By contrast, so-called qvevri white wines, sometimes referred to as amber wines because of their typically deep colour, are those vinified in traditional Georgian qvevri, large clay vessels ranging from 700 to 2,000 litres, buried underground so that just the opening is visible. The lightly crushed whole berries, including the skins and seeds, and sometimes even the stems, are fermented together in a qvevri, thus producing a wine with firm, even chewy, tannic texture and a wonderful panoply of flavours derived both from the variety and the winemaking, often ranging from apricots to chamomile. Soon after the appearance of Maisuradze’s revelatory wine, Gogi Dakishvili, a master of these qvevri wines, was able to buy a small amount of Kisi and make a wine in this second style. The cat was out of the bag and growers, including Dakishvili, started to replant when they saw the potential.  Kisi made under both the Dakishvili Family and the Orgo labels reveal all the textural and aromatic complexity of scented varieties made in this way. They are utterly pure, full-bodied wines with intense aromas and flavours that have sufficient structure to be very versatile with food. Qvevri winemaking was recognised as a UNESCO intangible heritage in 2013. While this is the style I particularly enjoy, for anyone who is not a fan of amber wines, there are fine examples that reveal even more of Kisi’s aromatic potential and deep but fresh fruit intensity. These include those from Winiveria and Khareba, and a particularly good off-dry style from Koncho & Co. One of the finest, in this case with light oak influence, is made by Danieli Winery, from vines near Argokhi, one of the three villages which were key to Kisi’s renaissance. Julia Harding MW

“Turbot,” Hugh Johnson says, the sense of satisfaction-to-come oozing down the phoneline. It’s a Friday morning and like any dedicated oenophile he’s already planned dinner, and – most importantly – what he’ll be drinking. I expected white Burgundy, something majestic drawn from a cavernous cellar, but Johnson – arguably the world’s most famous wine writer – is not nearly that traditional, or predictable. A Cambridge degree, a flawless RP accent, an air of good tailoring and tweed, and 60 years in the wine trade might lead you to think otherwise. But, throughout our conversation – even with a Covid-safe telephone call in lieu of a face-to-face – there’s an undeniable sense that there is forever a twinkle of mischief in his eye, and that Johnson is a man who enjoys being ever so slightly provocative. On the aforementioned Friday night, he was planning to uncork a bottle of Kit’s Coty Bacchus – “Giving it a good chance to show,” he says. Chapel Down’s single-vineyard bottling of England’s trademark grape comes from a chalky site on the North Downs, a spot that Hugh thinks is “a Grand Cru of the future”. He’s currently particularly excited about the prospects for England’s wine production – “Not just because I’m a patriotic citizen,” he reassures me.  “I’m passionate about the new school of English winemaking… wonderful characters and flavours are emerging from the south of England.” Gusbourne’s 2018 Pinot Noir “blew [his] socks off” and he’s keenly following low-dosage experiments such as Dermot Sugrue’s #ZODO. He wonders if perhaps the line of chalk between the North and South Downs could in fact be the Côte d’Or or Champagne of the future. It was an oft-quoted encounter with two Burgundies at university that set a young Johnson on the path to wine writing. I love the image of his university room-mate stumbling in a little too merrily, sloshing fine wine over the floor and Hugh’s undoubtedly immaculate notes, insisting that the serious and studious character sampled the two glasses in his unsteady hands. “One was magic and one was ordinary,” Hugh has said of the incident: he was instantly hooked. Cambridge’s Wine and Food Society laid the groundwork for his education, and he penned his first wine column for Vogue in 1960 – recommending a rather ambitious line-up that included 1955 Cheval Blanc and 1960 Ch. Margaux. There was a stint at House & Garden, then he took over from André Simon as editor of Wine & Food, joined The Sunday Times and started turning out a series of smash-hit books, starting with The World Atlas of Wine in 1971. His annual Pocket Wine Book – the world’s best-selling wine guide – has been solid stocking fodder for 44 years. The Story of Wine – first published in 1989, and a reprint of which is the cause for our conversation – is my personal favourite. It’s a book that captures exactly why I love wine: it literally seeps through our history, a liquid that links nations, cultures and generations. And Johnson’s passion for the topic drips off the page; writing that’s as intoxicating as the substance it describes. The oeuvre feels like it hasn’t aged a day since its initial publication, expertly tracing our ties to the vine and its fruit “from Noah to now”.   The copy I was gifted aged 21 is a hefty thing – an impractical hardback of coffee-table only proportions that precludes it being devoured the way it should be. I was delighted, therefore, to discover the latest edition is much more comfortably lap-sized – as Hugh describes it, “friendlier”. It’s a book that begs for an afternoon in the armchair. But it’s a book he never set out to write, and one that fell out of a foray onto the small screen. Much of the research was undertaken by a young history graduate Helen Bettinson, for a series aired the same year on Channel 4. “I learnt so much about history generally, never mind the wine part,” Hugh says. And that’s part of the joy of The Story of Wine – it’s not really a wine book; it’s just a great book, that happens to be about wine.  “When I started, there was very little knowledge around,” Hugh explains. “I saw my job as stirring up interest, encouraging people to enjoy wine in a very general kind of way.” The tricky thing, over the years, he says – has been avoiding the tendency to get closer to the subject, to focus on ever more detail – “sometimes a really boring amount of detail,” he chuckles. His heart sinks, he tells me, when someone asks him what the percentage of X grape is in a wine – “I’m not interested in percentages, yet the world is,” he laments. “To be frank, I sometimes think that journalists get into the nitty gritty because they have nothing better to say.” He’s a man tired of the state of wine writing (“glossy magazines full of incredibly boring photographs of vineyards”), and especially with winemaker profiles (“It’s pretty hard to engage the average consumer in the story of an Italian farmer: there are millions of them”). We should be, he feels, “getting the point of a wine” – but, most importantly, not the points. Johnson has long riled against scores. “My real beef against it is that it gives the impression that there’s something absolute going on,” Johnson says. He understands that for consumers it’s a short-cut (“you don’t have to read all the blurb”), but he’s fought long and hard to try and wean them off their numbers dependency. How something as varied and glorious as wine, something so dependent on “mood and moment” could be captured by mathematics – for Johnson – beggars belief. “The whole notion of a 100-point wine is unimaginable to me – how could it not be better?” For Johnson, a fine wine is a wine worth talking about – and that sums up rather neatly why scores are, for him, so offensive. As he says in the preface to the new edition of The Story of Wine, “If [wines] lack the power of speech they can still tell stories.” He’s sold 20 million books (and counting) filled with their stories, and his. But what’s next for the veteran wine writer? Well, proofs for his next gardening tome – the latest anthology of Trad’s Diary – are sitting on his desk awaiting attention.
