With the recent fruitful set of vintages from practically all the classic French regions, you would be forgiven for thinking one is spoilt for choice for quality and even quantity. The utter devastation across France’s vineyards this spring, however, due to persistent and heavy frosts, was a real wake-up call. There will be very little wine made in 2021 throughout France and the scarcity in the next 12 months will be a reminder of just how volatile and vulnerable wine production can be. Chablis took a particularly big hit, with production set to be down by as much as 80%. Expect to see global shortages of the more basic appellations (Petit Chablis, Chablis and Bourgogne Blanc) imminently, with 2020 stocks of these wines already largely sold. With this in mind, we look at the Premier Cru and Grand Cru 2020 releases with added interest and gratitude. Fortunately, it turned out to be another hugely successful vintage for the region (and Burgundy more generally), yet quite different in character to 2018 and 2019. Like much of Western Europe, Chablis experienced the warmest 12 months of temperatures on record, warmer even than 2003. This meant a very early start to the 2020 growing season and, while there were outbreaks of frost, the damage remained minor, particularly when compared to 2021. It was, according to Domaine Long-Depaquit’s Matthieu Mangenot, “a very easy vintage to manage, in terms of viticulture”. With a 40% reduction in rainfall and over 300 hours more sunshine than average, there were next to no disease issues in the vineyard. The dry weather even retarded weed outbreaks and this meant little to no spraying was required in the vineyards. But this shortage of water was bound to also stress the vines. “The drought caused the vines to slow down the maturation process of the grapes,” explained Mangenot. “This was quite an unusual phenomenon.” Since the growing season had started early, vignerons were looking to pick early, but the sugar in the grapes remained low throughout the summer and was only rising very slowly, pushing picking dates later and later. While this raised concerns over when to pick, it also provided many benefits to the final wine – benefits that would only become apparent after fermentation. For Mangenot, the very slow maturation process allowed more acidity to be retained. The berries also remained very small, helping to increase concentration. Despite this, the potential alcohol remained very reasonable – producing much more “classic” levels in the finished wines, around 12.2-12.5%. The other advantage of this slow ripening was that, unlike in the last few hot vintages, there was a lot more time at harvest to pick. Vignerons could take their time and pick certain plots only at optimum ripeness. In fact, after a couple of days spent harvesting the more mature vineyards, Long-Depaquit took a two-day break and slowed down the picking, just to enable the grapes to reach that extra level of maturity. While Domaine William Fèvre’s Didier Séguier was concerned about the effect of the sun’s intensity in July, he was happy to find “a very fresh profile to the vintage” – driven by what he describes as the “double face of the grapes”. One side of each row and therefore bunch was more exposed to the sun, providing a riper, warmer fruit profile, while the other side of the row, where the fruit was more shaded, produced fresher and greener flavours. Combined, the results proved complementary. Importantly Séguier noted that, while 2020 was a warm year, August was not as hot as in 2019; as such, the grapes were not as extremely ripe as in 2019, but did ripen less uniformly. WiIliam Fèvre started harvesting on 25th August – the earliest harvest date in the domaine’s history, alongside 2003. For Séguier, the main challenge was the difference in ripeness – “not just even between parcels, but also on the same row and even the same grape!”. In this respect, selection was key. For most, harvesting took place from 22nd to 23rd August and continued over a two-week period. Yields overall were about 20-30% down, due to a number of factors. A very cold snap in the spring damaged some vines, while the small berries also meant there was a lot less juice in the berries, and the bunches themselves were also much smaller. The biggest threat to yield, however, was the number of shriveled berries due to the drought. While these could easily be removed at sorting and therefore not affect quality, it was the main cause for the drop in yields. In many ways, 2020’s warm, sunny conditions seem similar to those of 2018 and 2019, yet the profile of the wines is completely different. The alcohol levels are much lower and the acidity levels much higher – the pHs sit around 3.3 to 3.35 (compared to 2019 which was closer to 3.45). Another point of contrast with 2019 was the relatively high levels of malic acid in the grapes found at some properties/in some vineyards – something that typically decreases in very sunny vintages This worked in the vintage’s favour for producers like Mangenot, since after malolactic fermentation there was more lactic acid. This added richer notes to off-set the citric acid backbone of the wines, bringing greater balance. All these factors are in direct contrast to 2019 – a very successful vintage, but almost the opposite in terms of flavour profile. “In 2019 there was lots of evaporation of water from the berries creating an intensely concentrated and stone fruit aromatic profile,” says Mangenot. “The grapes were ripening extremely quickly in 2019 and it was a rush to pick everything before the danger of over-ripeness crept in. If anything, the 2020 was the opposite, with some wines having a green, lighter, herbal edge – on the positive side of that spectrum.” For him, the 2020 vintage has become difficult to compare. “While it shares the very warm conditions of 2003, 2009, 2015, 2018, it doesn’t behave in the glass like any of them.” For Vincent Dauvissat, it reminds him of 2002 with a touch of 1997 – two dry vintages that managed to preserve their acidities and mature beautifully. “It is a vintage with a lot of charm and a very nice freshness,” he says. Dauvissat, unlike Long-Depaquit, had very little malic acid in his grapes and seemingly fewer issues with drought. “The vines at the estate do not seem to me to have had any water stress,” he says. “A few plots on the plateaus would have shown a little more, but the maturities followed their normal rhythm.” The 2020 vintage, according to Mangenot, is “one for the laboratory”. He thinks it is fascinating how the Chardonnay is adapting to climate change. How the Chardonnay can react on the vine to warmer and drier vintages without losing its sense of place. “Despite the heat and dryness, the alcohol levels are normal, the acidity levels are exceptional and the overall balance on the palate means the wines are representative of an excellent vintage for the region.” Mangenot was so impressed by the fleshiness in his Premiers Crus and Grands Crus, he was confident enough to extend the wines’ élevage on their lees – adding further tension and flavour complexity to the wine. “It is a vintage with great ageing potential in terms of balance and acidic backbone,” he says, comparing it to 2017 or 2012 – very popular vintages for vignerons in Chablis, where the acidity is classic but there is flesh too. It is what he calls “a truer expression of Chablis”. Séguier is also extremely pleased with the vintage. “The 2020 has the freshness of 2017, and the concentration and the expression of 2019,” he says. “A vintage that expresses a superb minerality and freshness with a nice intensity of fruit and especially citrus fruit characters.” While many wines are still maturing in tank (due to the extended élevage), there is a great sense of relief from those we spoke to. Firstly, no vigneron in Chablis is comfortable picking their grapes in August. The weather tends to still be very warm, bringing concerns about the grapes’ health once picked in such hot conditions. For Mangenot, however, this was managed well in 2020 and did not negatively affect the wines. Secondly, the year proved that a warm dry vintage can still produce a very classic Chablis style – defined by a citric fruit profile, floral aromatics and distinct mineral salinity. From what we have tasted this summer, the wines are excellent. The vintage offers great terroir focus, with each of the Premiers Crus and Grands Crus being unique in terms of flavour profile and structure. It looks set to be a classic vintage for the region, with lots of freshness and minerality – and a fascinating year in which to explore Chablis’s diversity. Chablis 2020: a mineral, saline sucker punch of a vintage

Colin Scott should be one year into his retirement. After 47 years at Chivas Brothers, 31 of which were spent as the Master Blender, he should be enjoying a well-earned rest. Instead, the ebullient Scott is lighting up the screens of the FINE+RARE team as he talks about a certain 50-year-old blended whisky he has created for remarkable spirits curators The Last Drop Distillers.   “It’s just fantastic to come to The Last Drop and find these nuggets of gold and all these wonderful casks of very precious liquid that have phenomenal complexity and flavour,” Scott says with unabashed glee.   Despite his near-50 years in the whisky industry, this is only the second 50-year-old blend Scott has had a hand in producing. Well-aged whisky was, until relatively recently, only a small part of Chivas’ business.   “By the time we’d filled a cask and it had matured to 12 years, most of that went into Chivas 12. Once it reached 21 years old, we put it all into Royal Salute. So, there was very little maturing. But of course, as time goes on, the stocks have been held back and the super-premium part of the inventory has grown.”   Scott joined Chivas Brothers in 1973 and became their fifth Master Blender in 1989. But he would have to wait a further 13 years before a 50-year-old whisky project presented itself. The result was The Royal Salute 50 Year Old, released in 2002 – a dual commemorative bottling for Queen Elizabeth II’s coronation and Royal Salute’s 50th anniversary.   Today he’s talking about his latest 50-year-old creation, The Last Drop’s 22nd release and first in-house whisky: a 50-year-old blended Scotch. After a whole three months as a man of leisure, the “retiree” joined the Sazerac-owned company as their first Master Blender in autumn 2020.   “When I joined in September last year, it was really the beginning of finding out what all these nuggets were within the inventory. Sorting through the very special and remarkable casks and finding out a little bit about what they were and what they did and how we could bring them together.”  Scott explains that everything in the blend started out as either a single malt or a single grain whisky, distilled at different distilleries around Scotland over 50 years ago. “At various stages along the way, blends have been made but then of course the balance has been put into cask and stored away for further maturation. So, what we have is a mixture of some of these malts and grains, all with their own unique characters and flavours, that we bring together at the last moment.”   Tasting the blended whisky alongside Scott is like being escorted on a journey back through time – to an age when a lot of distilleries were doing their own maltings and adding peat to the kiln to get a little smoky flavour.   “To me, blending is all about taking the flavours and then balancing them,” he says. “What you have here on the nose is a tsunami of flavour. But, when you taste it, nothing actually lingers and stays on top.”   Scott encourages tasters to add water to remove the aggression of the alcohol and maximise the release of the aromas and characters. When he is tasting more than 50 samples around a nosing table, this trick is vital to reduce all the whiskies to 20% alcohol and allow the flavours to present themselves.   In the case of The Last Drop 50 Year Old, its mellowness, richness and depth means you don’t necessarily need to cut the 48% dram.    “When we blend, we don’t add something, sniff it and then add a bit more of that. What we do is actually write down the whole formula in its entirety. We then pilot blend it. When we add the last addition, it will change the balance of everything you have already. So, you don’t know the final answer until you add that last part of the formula. And then once you’ve got them all together you can evaluate what you have actually created.”  For Scott, the act of blending and evaluating is an entirely personal thing. “All whisky – grains, blends – are fantastic. They are all different and they all bring their own song to the party. The only reason one is better than other is your own personal experience.”   Scott, for instance, isn’t “a fan” of the smoky Islays. “I don’t think they’re bad,” he adds. “It’s all about personal taste. There’s not a bad whisky in the world.”  The Master Blender talks at length about whiskies having different personality traits that require nurturing and, ultimately, respect.   “If you take a single malt as distillate at birth – that has a flavour package. It’s like you when you’re born – you have a character. If you put that new distillate into a cask, over the years this distillate will react with the oak in the cask and take influences and nuances which will then promote other flavours in the new spirit.  “So as time goes on, the volume actually goes down, the strength goes down, but that flavour package actually intensifies and intensifies and multiplies and multiplies.”   When it comes to age, there is some debate about how old you can go. For Scott, the 50-year-old is undoubtedly a rare beast, but he doesn’t see any reason why you can’t go older and rarer if the whisky has been sufficiently nurtured.   “If the angels didn’t interfere, in a quality cask, you could take it to 60-, 70-, 80 years,” he says. “If you’ve got quality casks, you don’t get that wood influence. You get a little touch of the oak but what you have at the end of the day is this small amount of highly intense, complex flavoured whisky that started as the new distillate and just grew with all the different influences from the oak and the cask whether it is Sherry or Bourbon.”  While there have been scientific advancements during Scott’s career, he says there are still a great many unknowns about the maturation and flavour process, and you get the impression this only adds to the allure for him.   “Because it’s nature, we don’t actually know what’s going on,” he adds. “It’s massively complex and the technical people still don’t know the number of components in Scotch whisky. I think they’re up to about 800 now. When I started there were about 200.”   Regardless, you sense Scott will continue to do what he does best: respect, nurture and blend remarkable liquids – retirement be damned.   Browse all Last Drop listings or read more Editorial

2005 Charmes-Chambertin, Grand Cru, Dennis Bachelet “Denis Bachelet’s wines are part of our family history, and we have always followed the domaine. My family has been bottling their wines for two generations so we always had access to them and could see the evolution of the estate over the years. Today, Bachelet is considered one of the best domaines in Gevrey-Chambertin, especially for their Premier Cru and exceptional village wine. "They own vines in only one Grand Cru – Charmes-Chambertin, but in my opinion their Charmes is the best. The vines are over 90 years old and situated directly across from Chambertin. The wine is always beautifully calibrated and refined. I drank the 2005 with my family over Christmas; it was perfectly balanced, powerful, concentrated and the tannins beautifully silky. If you can hold off I would say it will reach its full potential in another five years or so, but it’s providing great drinking pleasure now too.” Antoine Ninot, Buyer

It’s probably the best Grüner Veltliner I’ve ever had. The nose was full of white flowers, tropical fruit and apricot. The apricot really made me miss Austria! The best time to visit the Wachau is the flowering of apricot trees in spring – Austria’s sakura.  "On the palate, the fruit continues, matched with spicy notes, minerality and honey. It is rich, and the oak barrels no doubt give it that creamy texture. With three years of age, it was in a perfect spot, but it will be nice to taste this bottle in a few years, the wine has so much potential. In terms of structure, it actually reminds me of Corton-Charlemagne. I had it with creamed chanterelles, utterly delicious!” Magda Riepler, Brand Designer 
2010 Brunello di Montalcino, Caparzo, Tuscany, Italy “After all the stunning 2016 Brunello releases that have been coming out in recent months, it spurred me to explore another great vintage from the region. I was keen to see how the 2010s, now with a bit of bottle age, are developing. My first of the 2010s was Caparzo’s Brunello which still remains remarkably vibrant at 10 years of age, but the tannins are now melding beautifully on the mid-palate and are fully integrated with the fruit.  "The nose needed coaxing to start and, while not exuberant, the measured, perfumed nose is deep and complex and notably clean – roasted cherries, sweet fresh tobacco, pot-pourri, incense, dried lavender, it’s all there! The palate is still taut but pure, with damson fruit dominating, complemented by orange bitters and dark chocolate notes. This is really enjoying its mid-life, still not at full potential but I love the clarity, it’s not drying at all on the finish. Pop and pour and there is instantly a fragrant nose of cherries, and savoury leather. For good or for bad, the 2021 was a vigneron’s vintage, a year that required every bit of nous to circumnavigate the many issues that plagued the growing season. With an early budbreak and one of the latest harvests on record, it was a long and exhausting vintage for everyone involved. This was by no means a vintage that made itself – and its success was determined by the actions of man not nature. Whereas normally there tends to be quite a bit of variation between the sub-regions of Bordeaux throughout the growing season, in 2021 things were decisively challenging everywhere. All were initially threatened by frost, followed by mildew pressure, excessive rainfall in June, cool summer temperatures and a general lack of sunshine throughout the spring and summer months – only to be rescued in the final sunny weeks leading up to harvest. Some unlucky enough (mainly around Sauternes) also suffered hail damage prior to harvest. Despite the homogenously bad weather, the varying soils and varieties throughout the region all reacted quite heterogeneously, meaning some suffered more than others. Such were the manhours required in the vineyard in 2021, production and quality were going to be badly affected. Bear in mind this was all still at a time when Covid-19 was still a pressure point for employment, as noted by a number of wineries we visited. The mild and very wet winter brought an early and uneven budbreak, as early as 10th March in Pessac-Léognan and 15th March in Saint-Emilion – which was a full two weeks ahead of normal. This was followed by unseasonably warm weather, Ch. Figeac in Saint Emilion registered 25˚C, resulting in the vines’ quick acceleration of growth. With the vines already so advanced, the threat of spring frosts was all too apparent. Right on cue, temperatures plunged at night.  The 6th, 7th and 8th April saw black frosts cause significant damage across the region. Those worst affected in the classified sites were in Sauternes and Pessac-Léognan – with some châteaux in Sauternes witnessing their entire crop wiped out. The threat of frost was a prolonged agony for many, lasting right up until the 5th May, with temperatures recorded as low as -5˚C. For the Moueix estates in Pomerol, the combination of wind turbines and smudge candles could raise the temperature in the vineyard up by 2˚C – enough to protect the grapes. Other properties without such resources weren’t so lucky. Ch. Margaux's white wine vineyard is famously susceptible to frost. After installing a sprinkler system throughout the whole 8.5 hectares, the system malfunctioned, not working on 1.5 hectares where they lost everything (fortunately the remaining seven escaped harm). The frost damage was far from democratic, with estates within the same appellation seeing widely different levels of damage. As always, the châteaux on the Left Bank closest to the Gironde such as Ch. Léoville Las Cases and Latour came away largely untouched by the frost. Further north in Saint-Éstephe, châteaux such as Calon-Ségur and Montrose were also unaffected – not just due to their close proximity to the river. The cooler clay-rich soils of the appellation mean budburst is always delayed, and with the vines not as advanced, damage was limited. The risk of frost threatened Saint-Emilion for 10 days straight and led to a huge amount of work in the vineyards protecting the vines. The vineyards on the lower plains were worst affected, Croix Canon for instance, while Ch. Canon and neighbouring Ch. Berliquet up on the limestone plateau were spared, due to the vineyards’ fortunate south/south-west exposition – the brow of the hill protecting the vines from the freezing northeasterly winds. Vines basking in the sun at Ch. Latour If there was one moment of calm throughout the 2021 growing season, it came at flowering. Clement, dry weather engendered successful flowering, though rains arrived at fruit-set, leading to coulure for the Merlot. A huge deluge fell in June – as much as three times the month’s average rainfall. The damp, cloudy conditions saw the widespread outbreak of mildew that remained throughout June, July and into August. Bordeaux’s proximity to the Atlantic and the naturally high levels of humidity this brings have always made it susceptible to mildew, but for many vignerons we spoke to, this was the worst outbreak they had ever seen. The poor climatic conditions saw coulure and millerandage (the development of fewer and differently sized berries) badly affecting the Merlot on the Left Bank. This is why you’ll see such high proportions of Cabernet Sauvignon in the blends this year – with Cabernet being much less susceptible to both conditions. Despite the blanket attack of mildew, its effects varied from property to property. Ch. Margaux believed the mildew outbreak was the worst they had ever seen, yet for them, it never reached the grapes, only the canopy – allowing them to protect the fruit from damage. Perhaps their largely Cabernet Sauvignon plots made it easier to protect; Merlot certainly wasn’t so lucky. Further north in Saint-Julien, Ch. Ducru-Beaucaillou chose to leave the grass cover throughout the growing season to soak up the humidity and reduce the rain splash which spreads the mildew to the vines. Many sprays later and the yields were still significantly impacted; their Grand Vin is 98% Cabernet Sauvignon (the highest proportion ever) and production is the lowest on record, cropping at 20hl/ha. Ch. Pontet-Canet in Pauillac was devastated by mildew in 2018, losing two thirds of their crop. Despite the bigger outbreak in 2021, production was down only 15% – clearly having learnt how to better cope with the issue. The estate’s Justine Tesseron emphasised that you had to react fast to protect the grapes – you had to get out into the vineyards immediately after each rain episode to stop the spread. It was the year their newly built “tisanerie” came to the rescue, making them much more efficient in preparing their biodynamic sprays and reducing the overall impact. Many estates including Ch. Cos d’Estournel and Calon-Ségur carried out early de-leafing to reduce the impact of the disease. It was a huge risk. If the climate switched to more intense sunshine, the crop would have suffered significant sunburn. But the intensity of the sun, fortunately for them, was never that strong. With such high levels of rainfall in the summer months, the vignerons faced their next issue – a slow and uneven véraison. That moment where the energy of the vine switches from producing its canopy to ripening the grape is set off by a period of hydric stress – something which was not forthcoming in 2021. An event that typically takes place over two weeks was spread over four. The high rainfall also meant bigger berries and dilution was a concern, particularly as they edged towards harvest, worried the skins could burst and rot would set in. Fortunately, things finally started to dry up in August and, while temperatures remained mild, the grapes pushed through véraison. The September weather finally brought some hope for the vintage and, according to many vignerons, was their saviour. Sunny days and cool nights were ideal for grapes to concentrate, retaining freshness, while producing the beguiling aromatics that are so distinct in the 2021 wines. There was a little more rain in mid-September, most notably in the Médoc, which brought concern over rot, but any significant damage was held off by a dry and sunny October. Smudge pots or "bougies" between the vines, on hand to offer protection against frost The northern appellation of Saint-Estèphe was noticeably drier than appellations to its south, with hydric stress starting in July and “perfect weather” followed in August according to Ch. Montrose’s Lorraine Watrin. She compared the growing season to 2014, which was particularly successful in the appellation. By the end of September, throughout the regions, most of the Merlot was picked. Of course, the Sauvignon Blanc and Sémillon grapes, capable of growing in much cooler, wetter conditions, were much less affected by all of Mother Nature’s shenanigans. For the estates that avoided the frost, the whites reached good volumes and the fresh temperatures of the growing season proved ideal for the varieties. The whites were largely picked in the first two weeks of September and the top examples proved exceptional. For the reds, Mother Nature had one more card to play. Weather forecasts for the first weekend in October predicted heavy storms and more rainfall. With the large berries close to ripeness, a heavy storm could decimate the later-ripening Cabernets and would prove catastrophic for many on both the Left and Right Bank who rely on large proportions of Cabernet in their wines. With little choice, most ran the risk, and held out picking until the storms passed. Thankfully Mother Nature’s trump card was never played. Amazingly, the forecasters got it wrong, and the storms never came. Finally, the Cabernet was picked under sunny skies. Many châteaux such as Calon-Ségur held out as long as possible and were harvesting right up until 13th October – their latest harvest since 2012. What is extraordinary about the 2021 vintage is the complete inverse effects of the previous three years. Three vintages of relative drought, plagued with concerns over rising sugar/ alcohol levels, vines blocked from maturation due to hydric stress, and a genuine concern that the wines would lack full phenolic maturity, due to the compacted ripening season. Every one of these concerns was turned on its head in 2021, producing wines that are the opposite of the 2018, 2019 and 2020s. This unique season has put technology advances in Bordeaux to the test – from weather stations, UV boosting to state-of-the-art machinery – and at its best, they’ve defied the odds. A couple of decades ago, a growing season like 2021 would have produced very little wine at all, but today the Bordelais have proven that man can – at least for now – manage almost everything Mother Nature throws at them.
