As we commented in our 2022 report, vintages in Napa are, it seems increasingly defined by extreme conditions. The 2023 harvest, however, was – as Neil Bernardi MW, COO at Colgin described it – “remarkably unremarkable”.  “It was a calm and collected vintage,” said winemaker Cathy Corison, who has been making wine under her eponymous label since 1987. “There was nothing that forced your hand. It wasn’t too cold, it wasn’t too hot, it wasn’t rainy. We had the luxury of time.” For Corison, it was an exemplary vintage, easily one of her favourites – although she’s not quite ready to declare it the best vintage of her career (yet, at least). Corison is not alone in such praise: throughout the valley, whispers about 2023 have been growing louder, with the vintage felt by many to be one of the best in recent history.   Weather during the year was unusually cool at times, but largely uneventful. Looking back to the months before the growing season kicked off, however, Northern California received historic levels of rainfall. With a classic Mediterranean climate, the winegrowing regions of California experience warm, dry summers, with most rain falling between October and April.  In the drought years of 2020 and 2021, Napa received a scant eight and 10 inches of rain respectively. The 2022 vintage brought welcome relief, with 26 inches of rain measured in Oakville – just about average as measured against the past 10 years. Records were smashed in 2023, however, with an astounding 58 inches of rain measured between the close of the 2022 and start of the 2023 harvest. Local reservoirs were filled to the point of overflowing, and many vineyards in lower-lying areas were under water at points during the winter.   The rain stretched into May, punctuated by heavy fog and, with soaked soils and overcast skies, budburst was delayed by about two weeks. Although most winemakers on the valley floor reported excellent fruit set, resulting in higher-than-average crop loads, this was not the case everywhere. Up on Spring Mountain at Philip Togni Vineyard, winemaker Lisa Togni explained that incoming rainstorms reach this part of Napa first, and heavy cloud cover often lingers at peak level. Humidity and wind can hinder pollination, lowering the number of berries on each cluster. Yields at Togni, while not historically low, were much lighter than average in 2023. In stark comparison, Sam Kaplan, winemaker for Arkenstone and Memento Mori, reported having to thin “aggressively” during the growing season, with higher-than-normal potential yields thanks to large, perfectly formed clusters.   Springtime temperatures were cooler than average, a trend which would continue through the summer. In June and July, temperatures never exceeded 90°F (32°C) – highly unusual compared to every vintage in the past decade, and, while August warmed up slightly, there were zero major heat events. “Bad things can happen in the first week of September,” noted winemaker and viticulturalist Steve Matthiasson. Most Napa winemakers collectively hold their breath around Labour Day weekend, now notorious for heatwaves and wildfires. In 2023, however, extreme weather never materialised. Moderate, slightly lower-than-average temperatures persisted throughout September, and as the weeks ticked by, the fruit remained on the vine, slowly and steadily accumulating sugar and flavours.   For many producers, the biggest challenge of 2023 was being patient. Given the heat spikes in recent years, Togni said she was fully prepared for harvest by 15th August. Twice she scheduled pick dates only to call them off at the last moment when additional sampling showed that the ripeness was still not at the desired level. Finally, harvest began at Togni on 2nd October – a huge difference from 2022, when harvest started on 23rd August.   As the harvest season stretched on and temperatures remained steady, the potential for rain became worrisome. With fruit projected to be hanging in mid-October and even later depending on site, the chance of rainfall increased. This also did not happen. “Everything was just perfect,” said Myriad winemaker Mike Smith, noting that while the vintage conditions were certainly unusual for recent history, in many ways, they were a return to an earlier version of normal. “No one under 40 has probably ever seen a vintage like this. They’re more used to heat and drought,” he explains.  Smith started harvesting for Myriad on 5th October, which is about three weeks later than recent vintages. He wonders, though, if perhaps other winemakers kicked off harvest too early, which is something Kaplan pondered as well, citing a lack of mid-palate density in some of the wines he’s tasted – perhaps a result of looking at the calendar too intently, especially given recent harvest trends in Napa. Picking was still underway in early November at some addresses. At Colgin, Bernardi says that their patience paid off. “When we harvested, we felt like each vine was at the absolute apex of what it could give,” he said. “The alignment of sugars and phenolics was phenomenal.” He added that, at Colgin, the vine leaves started yellowing almost immediately after harvest, confirming their hunch that the fruit was fully developed and the vines ready to go dormant.   There were no concerns over yield – the plentiful water and cooler growing season not reducing crop size, and most brought in an above-average yield, especially on the valley floor. The quality of the fruit once harvested was uniformly reported as healthy, with multiple winemakers citing fresh, natural acidity levels and ample tannins. Smith loves the colour and density of 2023, noting that extraction was quick and easy, and the fermentation smooth. For Kaplan, a challenge was maintaining the body of the wine – handling the ferments in the winery to extract enough fruit to match the structure of the wine.   Many winemakers also praised the aromatics of 2023. In a hotter vintage like 2022, many of the delicate notes can be “baked out” of the wines, explained winemaker Tony Biagi of Patria and Hourglass. In 2023, Biagi said, the combination of red and black fruit, along with floral notes, has created highly perfumed wines. In his view, the 2023s offer “spectacular power and finesse”, with all “the stuffing” to be “a superlative vintage” – producing wines that will age for at least 30 years.  What may set the 2023 wines apart is the high level of “finesse and elegance,” as described by Andy Erickson of Favia. While he believes that 2023 may not be the most Californian vintage — at least by modern standards – the wines have a lithesome quality on the palate, balancing power and grace. This was a sentiment echoed by Bernardi, who praised the “sense of weightlessness” of the wines produced at Colgin, something he says only the greatest vintages can achieve.  Comparing the vintage to any other proves challenging. More than a few, including Matthiasson, said the weather during the growing season was reminiscent of 2011 – that is, without the October rains that ultimately caused a difficult harvest that year. Lisa Togni feels 2023 is more of a classic Napa vintage with moderate conditions, seemingly cool perhaps only because of the severity of the heat in recent years. Kaplan believes that the purity of fruit in 2023 is comparable to 2018, but even more pronounced. “The wines just jump out of the glass,” he said, “They’re so perfumed and aromatic.” For Corison, the very high level of quality of 2023 is reminiscent of 2001, which she said was similarly elegant and continues to evolve gracefully.  But is 2023 the vintage of the century, as the rumours might have it? Overall, the quality in 2023 is very high. After tasting through dozens of barrel samples, it’s clear that 2023 is a vintage where it was likely more challenging to make bad wine than good wine.  While we’re already looking ahead to 2023, more than a few winemakers lamented the quick dismissal of other vintages – perhaps overlooked in a rush of quick generalisations and soundbites. Quintessa’s Wineburg believes 2023 is undeniably a great vintage, however 2022 was also great – each year has its own personality that will appeal to different palates. For Erickson, the nascent 2024 wines (a vintage he’s particularly excited about) are more typically Californian in style with density and power, while 2023 will be defined by its finesse and restraint.  The 2023 vintage is outstanding – and the wines will appeal particularly to those with a classic palate. Given the late and long, cool growing season, many – if not most – of the wines have a distinct Bordelais quality, balancing pure Californian fruit with fresh acidity and elegant, nimble body – with “a sense of weightlessness” as Bernardi put it. The tannins seem poised to integrate well into the finished wines, and there’s a sense of restraint to many of the wines that is reminiscent of older Napa. The quality in 2023 is far more homogenous – in a positive way – than in recent challenging vintages, where site specificity and the ability to make quick decisions widened the field between those that faltered and those that excelled. “We’ve seen so much awfulness,” said Togni, referencing the challenges of 2020 and 2022, “but this was a nice reminder that not every year will be difficult: 2023 was a classic, great vintage – a storybook vintage.”   Napa 2023: the vintage in brief   Heavy rain over winter and through to spring replenished water reserves, with a long, cool growing season and late harvest  Yields were generally higher than average, especially on the valley floor  Quality largely consistent across the region  Cooler season with extended hangtime produced wines of elegance and finesse  Wines combine perfumed aromatics, fresh acidity and fine tannins, with a classic style reminiscent of the Napa of yesteryear  A top vintage – one of, if not the best in recent history  Keep your eye out for the first releases of Napa’s 2023 vintage. Since the fruit came into the winery, Napa’s winemakers have been quietly confident about the 2023 vintage – with murmurs of greatness. Now, as the first wines from the year are released, we find out whether the vintage is as good as the rumours suggest

Matthew Fioretti is not everyone’s cup of tea. The man at the helm of Cerbaiona doesn’t mince his words – and he’s got firm views on, well, I suspect pretty much everything. But he’s also unwaveringly honest, with a frank approach that is enjoyably refreshing – and rather unusual in the fine wine arena. He’s got a vision and story, one that he wants to tell, but it’s not one that’s been spun by a PR agency; it’s his. Fioretti has long been involved in the world of wine, running an import business in the US (Summa Vitis), which focused largely on Italian wine. He moved to Italy in 2004, and shut down the Summa Vitis operation in 2009 as he set his sights on making wine himself. After a few false starts, he heard that Diego Molinari – the longtime owner of Cerbaiona – was looking to retire. Along with a group of investors (the most significant of which is the American collector Gary Rieschel), Fioretti purchased the property in 2015, reportedly for €5.8 million. Molinari was in his 80s and it was clear that – while the site itself was exceptional – the property was run down and needed work. As we reported a few years ago, he promptly embarked on a radical project to restore the property and unexpectedly decided to declassify the 2014 and 2015 vintages to Rosso di Montalcino, only releasing the first Fioretti-era Brunello in 2021, with the 2016 vintage – the first to be made entirely by the new team.  Now, almost a decade later, he’s starting to be able to realise his vision for the estate – as we discovered on a visit earlier this year, with problems that “aren’t easy to solve”. The challenge, he explains, has been evolving from an “artisan” to an “atelier”. Under Molinari, the property developed a legendary reputation, but the operation was rudimentary – a traditional, family business, doing things the way they had always been done. Fioretti wants to bring the estate into the modern era, elevating the terroir with technical precision to craft wines that continue the Cerbaiona legacy. It is, he says, “a transition I wasn’t expecting to make”, but one that he feels is essential to safeguard Cerbaiona’s future. The distinction between artisan and atelier is a nuanced one – but one that comes down to an emphasis on craft rather than art, with a commitment to consistency, for which precision and hygiene in the winery are key, as well as a high level of technical knowledge. He confesses that he had envisaged having a more hands-off approach in the winery, having imported a lot of natural wines in his previous career, but has rapidly realised that top-level winemaking is full of “necessary compromises” (diving into issues like the fault quercetin). As a craft, winemaking can’t just be subject to the “whims of the producer”, as he suggests is the artisanal way. “I prefer to work more meticulously,” he explains. The American talks at pace, flitting from TS Eliot and the concept of “the pure critic” to Albertolli and neoclassicism, in amongst technical detail about fining and filtering. The estate is closed to visitors, deliberately to avoid distraction from what Fioretti wants to be spending his time on – making wine. As he whizzes us round the winery, our heads spinning as we try to absorb every detail, he talks us through exactly how he’s bringing new exactitude to the operation. The vineyards have all been replanted and a steep-sloped olive grove replaced with vines, all with selected rootstocks and clones sourced from France’s Guillaume nursery, to give them the best possible raw material. Once seen as too labour-intensive to farm, he’s convinced the ex-olive grove might just be the best site on the property. The rustic old stables and granary that acted as the cellar and winery have been carefully renovated, with water and drainage installed throughout, and the equipment all updated. Importantly, Fioretti has added a full in-house laboratory – something that is exceedingly rare for a property of this size, let alone Italy where the high-tech approach is far from the norm. The fruit is now all chilled after harvest, de-stemmed and cold-soaked, using inert gas to protect the must. While he used upright wooden tanks for fermentation for his first five vintages, Fioretti switched to stainless steel to allow for better hygiene and temperature control (preferring a maximum 26̊C), as well as allowing him to programme them for automated punch-downs and pump-overs. He’s started co-inoculating for primary and malolactic fermentation, meaning the wines go into barrel very clean – and can be sulphured right away. These are tweaks, minor modernisations, but one of the most significant changes Foretti is making is the time the wine spends in wood. While Molinari favoured four-plus years in 500-litre tonneaux, Fioretti has gradually started bottling the wine earlier and uses a combination of 350-litre barrels and 15-hectolitre casks. “Even two years [the appellation minimum] in wood is too long,” he says – before quickly acknowledging that such a view is far from accepted, and he cannot legally reduce it any further. The various consorzios may not like it, but it’s a view that is increasingly common among younger producers in Italy, who are frustrated by minimum oak-ageing requirements and their contrast with the wines today’s consumers want to drink. As Fioretti says, however, “The notion of wood is very delicate.” And while he’d rather be able to age his wine in other vessels during their first two years of life, he acknowledges that élevage in oak has a beneficial impact on the chemistry of wine – aiding stability. With such a beloved wine, it might seem controversial to change anything – especially the way it’s made, but that hasn’t stopped Fioretti. Looking back at older vintages from the estate, even the legendary 100-point 2010, he is sometimes underwhelmed, feeling that there’s much greater potential. Part of his plan to reflect that potential is bottling earlier, allowing the fruit to shine through and give the wine better balance – something he feels is key for ageing potential. He’s also keen to make sure the wine is moderate in alcohol with maximum 14 or 14.2%, even in the warmest years. And most importantly, he says, good wine has to be delicious. Having tasted the 2019 and 2021 with Fioretti – the results so far really are. There’s a vibrancy and purity that makes them irresistible, while not sacrificing the structure that will allow these wines to go the distance. Alongside Cerbaiona, Fioretti has also created the M.L. Fioretti label, one he describes as “part garagiste, part petit château”. He was keen to explore indigenous grapes, which “are part of the family – but not all thoroughbreds”, as well as plots of Bordeaux varietals (grapes with undeniable pedigree) – provided they’re planted in the right place. The Casaglia Colorino is bright and spicy, while the San Vito (sadly the last vintage of which is 2021) is a beautifully lush and vibrant Merlot. These are fascinating wines that allow Fioretti to experiment more – outside the constrictions of the Brunello di Montalcino appellation. Controversially, Fioretti has declared Cerbaiona a “No Scores Zone”, echoing the sentiment of Teobaldo Cappellano that numerical ratings are divisive, at best – and don’t do justice to the craft of winemaking. In his notes on the 2018 vintage, Fioretti wrote: “This is another vintage for the connoisseur, that true lover of wine and the vine. So be it if the ‘collector’ misses out.” Feathers might be ruffled by such remarks, but the motivation here is clear: an earnest passion for wine. It’s something that shines through in our conversation – and in the wines he’s making. Lisa Perrotti-Brown MW has caused quite the stir. In her Bordeaux 2021 en primeur report, her first for her new publication The Wine Independent, she scored some wines below 80 points – and just 20% made it above the 90-point mark. She’s a woman on a mission, determined to bring honour and integrity back to wine criticism. The Master of Wine and Robert Parker protégée stepped down as Editor-in-Chief of the Wine Advocate – the leading fine wine publication – last year. She was tired of what had become a corporate life. Michelin took over in 2019 and her time was increasingly spent in meetings, doing reporting, looking at corporate responsibility as well as managing her team and making sure everything was going to plan – a plan, she emphasises, that was not set by her. Most importantly, her senior position took her further away from what she really loved doing – writing about wine. “I love to sit down with winemakers and capture that story that is not on their website, that is not in their marketing material. Something that is real and raw. There is not enough of that,” she tells me. Her view is that it’s the story that makes wine “more than just a drink” – and that’s why people spend hundreds of pounds on a bottle. This storytelling is what she’s looking to do with her new, small outfit, The Wine Independent. Importantly she’s partnered with Johan Berglund – a professional photographer (whose beautiful images we've used here) – to bring those stories to life, with a modern platform that is a world away from most other critics’ sites (often “a wall of words”, she says). As the name of the new publication suggests, Perrotti-Brown is making a stand against publications that she feels no longer put the consumer first. Her inspiration is Robert Parker’s original operation – the Wine Advocate started as a small newsletter shared with friends. “Essentially a mom-and-pop shop”, she explains, getting back to basics, with minimal staff and no fancy office with big overheads. For her, the goal is simple: to publish timely – and honest – reports, allowing readers to search for wines easily and helping them to discover something new. She doesn’t hold back voicing her concerns about the state of wine criticism today. She’s damning, believing there’s a trend not just to overscore, but that it’s a strategy to gain influence, helping critics be quoted by retailers and wineries – and therefore benefitting from “free marketing”. “When you see people coming in one or two points above everyone else and they hang on and wait until other people’s reviews have come out… I mean, come on, it’s definitely happening,” she says. The compaction of scores, however, is what really riles her. Everything sits between 95 and 99 these days, she suggests. “Nobody dares to go to 100 and nobody dares to go below 90.” Perrotti-Brown is outspoken about critics for whom the tiny number of 100-point scores they hand out is a point of pride. “There are a lot of critics who are just too chicken-s**t to give 100 points,” she says. “If you know a wine is 100 points, it takes a lot of bravery to put it out there.” Some critics – such as James Molesworth of Wine Spectator – don’t believe that a perfect wine exists, and therefore never give 100 points. “Which is ridiculous!” says Perrotti-Brown. “Why use a 100-point scale, if you are not going to use the top?” Her fear is that scores will lose all relevance and meaning. Indeed, she notes that retailers don’t even reference who gave the score they quote. “You go into a shop these days and look at the shelf-toppers and it doesn’t even say whose score it is – it just says 97 points. Every wine is 97 points!”  Critics should be fighting for consumers, she argues, rather than ingratiating themselves with wineries. “I know it is difficult, because we are sat there right in front of the winemaker, listening to their stories and I think the impetus is to really feel for that person, but you can’t. You always have to see it from the consumer’s perspective – it’s what Bob [Robert Parker] always told me. You are working for them.”  Hence, therefore, the broad range of scores that she felt was inevitable for a vintage like 2021. It was, she admits, a difficult vintage to assess in the evolution of Bordeaux. She’s adamant that she hasn’t changed the way she scores: “It just happens to be the worst vintage Bordeaux has had for a very long time,” she explains. Perrotti-Brown refers back to Robert Parker’s original benchmark for 90 points – an “outstanding” wine, a wine that is complex and age-worthy. For her – tasting very widely across the region – the majority of 2021s don’t meet those criteria, but she’s quick to emphasise that wines scored in the upper 80s are very good wines. “I think there has become some stigma over the wines scoring in the 80s and I don’t know why,” she says. Again returning to Robert Parker’s original scoring crib-sheet, these are “good to very good” wines and that is where, she feels, the bulk of Bordeaux 2021 wines fall.  Looking back at Robert Parker’s own en primeur scores in trickier vintages (2007, 2013, 1996), he too was awarding many wines eighty-something points, sometimes less. While Perrotti-Brown accepts the technological advances in viticulture and vinification mean you would rarely see Classed Growth wines receiving less than 80 points today, it only emphasises just how challenging the 2021 vintage was in Bordeaux. Of course, the vintage also produced some surprises. Despite everything that happened climate-wise, there were a number of wineries that produced outstanding wines, even by Perrotti-Brown’s assessment. “Some wines were absolute trainwrecks and there are other wines that are wow… you can tell these people worked their tails off,” she says.  The critic was certainly surprised and disappointed by other reports on the vintage, particularly given she’d worked and trained some of the people behind them. “When I am looking at other peoples’ scores [for Bordeaux 2021], 60% or more of the wines scored 90 points and above and that is astonishing to me,” she says, both confused and outraged. “Some of these wines, they are giving the same score ranges as the 2018 and the 2019s – I mean how is that possible?” Her report is a statement of intent. Lower scores may mean The Wine Independent isn’t as widely quoted by the trade, but what matters to Perrotti-Brown is whether consumers trust the publication. It’s a long-term game. “Eventually I hope consumers will look at all these other scores and say, ‘But what did The Wine Independent say?’” Perrotti-Brown took a huge risk stepping down from what is undeniably the wine world’s most influential publication – but she is confident she’s made the right choice. Her need for autonomy was the impetus for her to set up on her own, and she’s found freedom on her own terms. It is still early days for The Wine Independent and, for now, Perrotti-Brown is their only reviewer – although she confirms an additional critic will be announced in the coming weeks. Competing against more established publications with an extensive database of tasting notes and scores isn’t easy – but Perrotti-Brown has established herself as a disruptor in the field. She’s lain down the gauntlet – daring her peers to put the consumer back at the heart of what they do. Read more Editorial

The name Andrew Rankin might not mean much to the average whisky drinker. But mention him to the whisky world – the one that exists behind the public glare, and is largely reliant on lasting relationships and mutual respect – and there’ll be little doubt who you’re referring to.   Throughout his career, Rankin has worked for two of the biggest names in the industry: Chivas Brothers and Morrison Bowmore. When we speak, on an overcast Monday in early November, he tells me it’s 47 years to the day that he joined the ranks as a trainee blender at Chivas.  It’s hard to imagine a wet-behind-the-ears Rankin embarking on his “old-fashioned proper blending training”. He remembers those days fondly, tasting hundreds of different distillates – including malts and grains from Scotland and the US – from the vast library, and getting stuck in with every aspect of the production process from distillation to the vatting and cask dumping. It wasn’t long before the young Rankin found his passion: casks.   “There was a lot of not-very-good wood filled in the industry way back in the 1970s and ’80s,” he tells me. “Even in those early days, I pushed to get some better quality wood in the system.”   Rankin learned from the old guard at Chivas who’d spent their life in the industry. In the early 1990s, he moved to Morrison Bowmore in a General Manager role, concentrating on blending, inventory management and, most importantly, cask trading. He spent 22 “lovely years” at the company until his position became untenable when Suntory (“in their infinite wisdom”, Rankin says wryly) decided to buy Morrison Bowmore’s owners Beam in 2014.   Rankin says the whole dynamic changed overnight and the decision to move global management of all spirits – including whisky – under American management in Chicago was the final straw for him, Chief Executive Mike Keiller and Finance Director Douglas Crawford, who all walked that same year. Rankin says he “doesn’t want to get into it all” but does say part of his motivation to leave was the fact he didn’t want to work for an American-managed company that late in his career – having already experienced a similar takeover with Chivas and Seagram many years earlier.   Rankin is a loquacious Scotsman. When you land on the right subject, he can talk endlessly with such knowledge and humour that it’s easy to lose track of time. In fact, when a small team from FINE+RARE visited his new distillery project, Ardross, in August, we did just that. One thing he doesn’t talk about, without great coaxing, is his immense success. This includes but is in no way limited to his work on Bowmore Black, the Trilogy releases, and the 50-year-old. He is a humble man, and has quite intentionally stepped back from the limelight, while some of his counterparts have been drawn to it.   Since setting up his own company in 2014, Rankin has not stopped working. Undoubtedly his biggest project has been Ardross, a new distillery in the Scottish Highlands. Rankin was given the mandate (and a healthy budget of £30m) to find a home for the new distillery by Ardross Single Cask Society founder Barth Brosseau. He found the dilapidated 50-acre site, which was formerly a farm, with its own seven-acre loch and moved heaven and earth to turn it into the stunning distillery we see today.   Rankin says the project has, and continues to be, “much much bigger” than he originally anticipated, and what started out as a little tree constantly grows branches all over the place. But, he says, it has been his biggest achievement to date.   The latest unwieldy branch is a second, small-batch distillery that is being built on the Ardross site, destined to become the Creative Suite – exclusively for Single Cask Society Members’ use. Once completed, it will be capable of producing 250 casks a year of almost any style of whisky that a Society Member could desire. When it is up and running, likely by the end of next year, Society members will be able to call Rankin or visit him at the distillery to discuss their requirements. He will advise them on certain elements and Sandy Jamieson – Ardross’s Distillery Manager with near-50 years’ experience, and hands-down one of the most hospitable people you will meet – will get involved in the “nittier grittier side of the distillation”.  “Society members have the flexibility of different malt styles, of different grain stills, of different blend styles, and the multi-cask options that we’ll have available,” Rankin says. “But always without getting to the gimmicky stage,” he adds gravely.   This is a word that comes up a lot in our conversations – “gimmicky”. Rankin is, by his own admission, a traditionalist and has baulked at the changes in the whisky industry over the past 47 years.    “In my mind, a gimmicky type thing that lets you say we were the first in the world to do x only lasts a day and then it’s old news,” he says. “So everything we do falls within traditional methods – but pushing the boundaries a wee bit in terms of the styles of whisky.”  After spending a number of hours with Rankin, you can tell he’s not the type to mince his words – his standards are exacting, and he’s been around the block enough times to know when he’s being sold a pony. For these reasons, and many more, he’s unafraid to tell Brosseau – who he on occasion butts heads with – and Society members what he thinks.      It’s this straight-talking, mixed with an unwavering sense of tradition, that has stood him in such good stead throughout his career. Relationships formed over the past four decades have been vital to getting Ardross off the ground and saved his bacon – and the whisky producers he’s worked for – countless times.   “I always made it my policy to not sit on the end of the phone negotiating prices or volumes never having met the person that’s at the other end,” he tells me. “I’ve made it a policy that we’d go and visit all the major suppliers. We’d have dinner with them. We’d get to know them.”  When Rankin first started visiting Kentucky – a place he has a real fondness for and has undoubtedly influenced elements of the Ardross build – the state was just coming back from a real depression. He got to know a lot of people in the cooperages and distilleries, and many of these relationships last to this day. You sense it is this longevity and being around throughout hardship that has fortified these ties. The same is likely true of Japan. Enviably, Rankin has a relationship with one of the oldest independent cooperages in Japan, from whom he sources a steady amount of the mystical Mizunara cask – something many producers would give their right arm for. As quite a coup, Ardross filled some of its first runs of new-make spirit into Mizunara in 2020.   Rankin is too humble to go into detail but he does say these relationships have proven useful over the years. “If barley is in short supply, which it was not that many years ago,” he says, “because of our relationship, we would always get priority. If casks were in short supply, we’d always get the priority.”   Sadly, this way of working is something Rankin sees diminishing in most industries. “Everything is done via Zoom and telephone and internet now,” he bemoans. “Having listened to some of COP26, the environmentalists will say that’s a good thing, you’re not using air travel, but there has got to be a balance.”  Another change Rankin “isn’t keen on” is “the quest to get something different all the time”. “All the limited releases,” he says downcast. “The best limited release now is the standard edition because [producers] push everything else and don’t push the standard edition,” he only half jokes.  “Make no mistake, Barth and I have had a lot of serious heated discussions on various things like all the different wines and tequila [finishes]. It’s not traditional,” he says impassioned. “Why would we want to put a perfectly good product into a cask that’s had tequila maturing for six months?”   He pauses for what seems like an eternity, and I’m unsure if he wants an answer, before he, mercifully, continues: “I ask the question and I’ll get the response that it’s what the modern market wants. To which I respond: ‘says who?’”  Throughout his career, Rankin says he’s always stuck to the more traditional casks, like Sherry and Port. But he’s quick to say that the market is a minefield, and you need to proceed with caution as producers are often offloading casks for a reason.   “Even Port is one that would be low down of my list of things to use,” he says. “Because historically, Port producers don’t generate a lot of casks. They only generate them when they are clearing a warehouse out. The casks will be sold to people in the whisky industry when there is absolutely no maturation left in them at all, so you’re achieving nothing by finishing in those types of casks.”   Rankin says the only chance you have of producing a decent whisky, or at the very least not ruining the good one you’ve got, is to deal with certain individuals who will give you a cask that’s not spent.   He tells me some horror stories from the Glasgow facility where he warehouses and oversees cask operations. “We see some of the casks come in, and we’ve gotta send it back. They’ll say the Sherry casks are new. They’re not. They are probably the oldest casks that have been lying in that bodega. I have to say to the client, ‘Trust me, you’ll lose half your whisky because it’s not good wood, it’s very porous-looking, the smell inside them is slightly sour and you can’t get rid of that. But, it’s your gamble’.” Unsurprisingly, they heed his advice and make another call pretty sharpish.   He adds: “You’ve just got to know what you’re looking for and be careful. Because you can ruin a perfectly good whisky.”   It’s rare to meet somebody with such candour in or out of the whisky industry. 2020 Ch. Tour Saint-Christophe, Saint-Emilion  There is lovely restraint to Tour Saint-Christophe this year, only furthering this wine’s already huge appeal, considering the overall quality and moderate price point. High-quality oak provides a lovely toasted, peppery spice aroma on the nose that interplays beautifully with lifted, lavender tones. There is a lovely finesse to the blackcurrant and plum fruit on the palate. It is concentrated, juicy and succulent, but not at all over-ripe. The fruit has a pristine character matching the detailed tannins, making for a moreish finish. With impressive length and fantastic balance, this is a top-value buy – and has never been better. The blend is 80% Merlot and 20% Cabernet Franc.  2020 Ch. Laroque, Saint-Emilion  Quality at Ch. Laroque continues to rise and David Suire has crafted a superb 2020. Despite being a blend of 99% Merlot and 1% Cabernet Franc, this wine has real freshness and an herbaceous edge to it. The nose is scented and enticing with aromas of Darjeeling tea, ripe plummy fruit and a fresher more redcurrant note. It’s a tight little wine at present, with a compacted palate full of promise and fine-grained tannins. There’s a lovely iron-like earthiness and long, saline finish.  2020 Ch. Berliquet, Saint-Emilion  The overriding quality of 2020 Berliquet is its clarity and purity of fruit. Strawberry, redcurrant and blackberry fruit fills the palate, while a lifted florality on the nose is allied to darker, spice notes adds aromatic complexity. The tannins are fully resolved – silky, dense and well coated with the concentrated fruit and no drying elements. The wine is medium-bodied with excellent balancing acidity and while it doesn’t have the depth of neighbouring Ch. Canon, it does have a similarly elegant profile and freshness.  2020 Clos du Clocher, Pomerol  Clos du Clocher is a very expressive Pomerol in 2020, with crushed dried flowers and fresher violet aromas dominating the nose. It is already quite open on the palate with soft, juicy tannins. It is ripe, made in an opulent style, with black plum and classis fruit on the palate, as the violet tones continue to linger above. The fruit is pristine and the wine has an impressively long finish. It will no doubt be a top-value buy for the appellation and one to enjoy quite early.  2020 Ch. Lafon-Rochet, Saint-Estèphe  This is a swarthy Lafon-Rochet, full of dark bramble and blackcurrant fruit, with aromas of almost curried spice, cloves and violets. The palate has a gorgeously silken mouth-feel, seeming plush even at this youthful stage. There’s a real weight of fruit with a wave of freshness and the firm, present tannins – beautifully ripe and integrated. There’s a compact core to the wine – packed full of bramble fruit and salinity. There’s a pepper and floral freshness to balance a slightly chocolatey density to the finish. The blend is 61% Cabernet Sauvignon, 22% Merlot, 3% Cabernet Franc and 3% Petit Verdot.  2020 Ch. Duhart-Milon, Pauillac  Domaines Barons de Rothschild has made significant investment in a new winery for Ch. Duhart-Milon and, if the 2020 is anything to go by, it was worth the expense. The uplifting fragrant yet classic nose of vanilla, menthol, cassis and graphite minerality screams Pauillac. There is a lovely finesse to the tannins – detailed, very fine and matched by a lovely juiciness on the mid-palate. It is so much plusher than normal, but very Lafite-like in its restraint. There is mouth-watering acidity too. This is excellent, medium-bodied classic Bordeaux with a long finish. This really is a step up for the estate, with a new level of elegance to the palate.  2020 Ch. d’Armailhac, Pauillac  One of the most pleasant surprises in the Pauillac tasting was Ch. d’Armailhac, which seems to completely overdeliver in 2020. The colour is intense and the palate is beautifully ripe, while also remaining mouth-wateringly fresh. There is a lovely precision to the Cabernet fruit that makes it stand out. It is a very succulent and moreish wine. The tannins are very fine – firming up nicely on the finish and adding structure. You feel d’Armailhac made the most of the vintage, achieving full phenolic ripeness, while managing to retain freshness and a medium body. Impressive.  2020 Ch. Batailley, Pauillac  There’s a lovely crunch to the nose of 2020 Batailley – with aromas of redcurrant, raspberry, vibrant fresh blackcurrant, but it’s also really floral, with rose, violet, a white pepper spice, a little cocoa, and a savoury, barnyard touch behind. On the palate is soft and beautifully textured – like reams of silk, but then the wine firms up as layers of chalky tannins build up to give the wine structure. There’s a slight warmth of alcohol, but a wave of tart, almost green-apple acidity that keeps the wine feeling really fresh. Even now this feels surprisingly approachable, fresh and moreish, with a core of dark and savoury fruit. Once the scent of florals and red fruit fade, the finish is long, earthy and iron-edged.  2020 Ch. Langoa Barton, Saint-Julien  Ch. Langoa Barton is impressive in 2020. It has a lovely perfumed, floral nose with distinct violet tones. The ripe cassis fruit and milk chocolate flavours bring a lovely richness to the wine, but it is not at all overblown. The fruit is pristine, the tannins are serious yet refined and matched by a lovely natural juiciness. This is very well-balanced Saint-Julien from a vintage that seems to suit the Langoa terroir.  2020 Ch. Labegorce, Margaux  This Ch. Labegorce is particularly attractive – a bright almost scarlet purple in the glass. The nose is opulent with rich, dark red cherry and plump plum fruit complemented by a floral lift and toasty undertones. On the palate, the fruit is bright and crunchy, with good density. Vibrant and silk-textured, the tannins are fine textured. A charming, quite exotic Margaux. The blend is 50% Cabernet Sauvignon, 45% Merlot, 3% Cabernet Franc and 2% Petit Verdot, aged in 40% new oak.  Explore Bordeaux or read more Editorial

Talking to producers about the 2020 vintage in Bordeaux, their excitement is palpable. Dramatic gesticulation and unabashed grins made for little modesty, but there is also a certain amount of relief. This was not an easy season for the region’s vignerons – a rollercoaster of a year that really put them to the test (and that’s without taking the global pandemic into account).  You can read more about the conditions in our piece on the growing season, but – in brief – it was a vintage of two halves. The season started with a mild, wet winter and spring, with the growth cycle around 10 days earlier than normal. “It was a very, very precocious vintage,” Daragh Quinn at Ch. Fieuzal explained. The damp conditions led to mildew pressure, demanding winemakers’ presence amongst the vines to stave off the threat (especially for organic or biodynamic producers).  From mid-June, the weather shifted dramatically, becoming dry and hot, resulting in some vine stress. Mid-August rain provided some relief on the Left Bank (less fell on the Right), while cool nights in late August and September were key to preserving aromatics and acidity. Harvest was swift and early, with the whites picked from mid-August, the Merlot from early September and Cabernet following from the middle of the month. There was a little rain towards the end of harvest, welcomed by some producers in the Médoc to plumpen the extremely concentrated Cabernet berries.  The resulting crop was beautifully ripe, but with particularly small berries – something that means yields were impacted. “The frustration is the volume produced,” Damien Barton-Sartorius of Léoville and Langoa Barton explains. “I’m a farmer talking – we like a good quantity.” For him, the yield was down around 20%. At Lafite and Duhart-Milon, the reduction was around 15%, a little lower at L’Evangile where mildew had more of an impact. Angludet was hit hard, with just half the normal crop – something that surprised Benjamin Sichel – but this was an exception rather than the rule, with a reduction of 20 to 30% on 2019 the norm.  So, how did winemakers handle the vintage? First and foremost was managing the extreme growing season. Getting out amongst the vines to spray and protect against mildew was essential. Most left larger canopies in place to offer much-needed shade for the fruit during the hot summer conditions. Picking dates were key to preserve acidity, and many also chose either to pick in the early morning – allowing both the fruit and pickers to enjoy cooler conditions – or chill the fruit on arrival at the winery. This helped preserve the delicate aromatics and enabled producers to control fermentations better.   The small and concentrated berries meant there was a higher than usual skin-to-juice ratio, and the potential for a lot of tannin. It was therefore all the more important that extraction was gentle, especially as the seeds weren’t necessarily ripe as Edouard Moueix (of Ch. Bélair-Monange and La Fleur-Pétrus) highlighted. As Guillaume Pouthier at Les Carmes Haut-Brion told us, it was about “passive extraction” which he did entirely via infusion for the first time this vintage. Lafleur has never pumped over as little as they did in 2020, but it simply wasn’t needed with the perfectly ripe fruit, Cellar Master Omri Ram explained: “Aromatic compounds, ripe tannins, flesh, it all came out of the grape so easily.”  On paper, it’s tempting to think that the 2020s were destined to be big, bold, super-ripe and tannic. Fortunately – and much to many producers’ bafflement – it’s not so. While in some ways the vintage could be compared to the similarly hot 2003, the wet start was key – supplying the vines with essential reserves to get them through the warm, dry summer. Similarly, the mid-August rain was a godsend for the gravel soils on the Left Bank.  In short, the 2020s are very good and, in some cases, outstanding. Surprisingly elegant, the wines combine the ripeness and density of a warm year, yet with a wonderful freshness and aromatic precision. On the Left Bank, the alcohol levels are modest (notably Lafite is a mere 12.8%, while few sit above 13.5%) – something attributed by some to the August rain. The fruit is ripe yet with a real refreshing crunch to it. There’s a vibrancy and saline acidity that makes the wines moreish. These classical expressions of Claret are, as one winemaker noted, wines that will appeal to the English palate. “It’s quite incredible, the freshness,” Vincent Millet, Calon Ségur’s General Manager, said. He noted that these are wines with “beaucoup d’éclat” – wines that leap out of the glass.  “I just love the 2020,” Nicolas Glumineau at Ch. Pichon Comtesse told us. “It’s full of energy, exploding out of the earth. Full of minerality.” Thomas Duroux at Palmer captured it nicely, describing the vintage as having a “Latin flair” yet also a class and restraint. Antoine Gimbert (Léoville Las Cases, Nénin and Potensac) put it similarly: “flamboyant and subtle at the same time”. Pauline Vauthier at Ausone highlighted the long ageing potential of the vintage – having the requisite length, minerality and freshness.   On the Right Bank, the wines are plusher, the alcohol levels consistent with recent vintages (most at 14 to 14.5%), but there’s still a restraint and elegance on show. While there’s plenty of concentration and structure, the tannins are seamlessly ripe (making them relatively approachable for cask samples) and they are aromatically expressive, often with a distinct floral imprint. Noëmie Durantou Reilhac (Ch. l’Eglise Clinet) emphasised how important she felt élevage was for the vintage. It “would have been very charming, very seducing – but not as deep as it could be. The élevage brought that deepness to that very juicy, flashy fruit,” she said. Pierre-Olivier Clouet at Cheval Blanc feels it’s a wine that will need time, describing the tannins as “a little academic”. For him, the dry conditions “explain perfectly why the wines are so dense, so powerful, so intense”.  It is important to note that this not a totally homogenous vintage. The challenges of the growing season meant that only those who could and did put in the requisite vineyard work excelled. The dry conditions meant that terroir held even more importance than normal. Cooler, water-holding clay and limestone soils were an advantage; the well-drained gravels that house much of the finest Cabernet sometimes struggled. It is for this reason that the Right Bank seems to have really shone, and it’s arguably a Merlot vintage – but that isn’t to say there aren’t some superb Cabernet-led wines. Saint-Julien, Margaux and Saint-Estèphe are the most consistent on the Left Bank, while the top names in Pessac-Léognan have over-performed. The finest Pauillacs are glorious – pinpoint, precise examples of what this commune does best.   Justine Tesseron at Pontet-Canet was one of many to agree that 2020 is the “third in a trilogy of top vintages”. Given the year’s unusual conditions, comparisons have proven hard. Pierre-Olivier Clouet at Cheval Blanc feels 2020 has a palate like 2010 or ’11, with the nose of 2015 or ’09. The wine reminds Noëmie Durantou Reilhac (Ch. l’Eglise Clinet) of 2015. At Léoville Las Cases, Jean-Hubert Delon compared it 1988. Vincent Millet at Calon Ségur feels it is like 2016, except with more density. While in numbers it’s similar to 2010, Haut-Bailly’s Véronique Sanders feels 2020 is a very different wine – with a “contrast between power and this elegance”.  “It’s very close to 2019 – very classic,” Nicolas Glumineau (Pichon Comtesse) said. “To me it has something like the energy of the 2019, and the uprightness and strength of the 2016. It’s a great wine, I’m sure about this.” The term “classic” comes up time and again – something Jean-Sébastien Philippe at Lafite also proposed, versus the more modern 2018 or 2019. At Ch. Margaux, Philippe Bascaules described it as a more concentrated 2019, or a fresher 2018, but feels all three vintages are of the same, high quality.   From our own tasting, we can’t help but agree – this is another very good vintage to follow on from 2018 and ’19. Great? Maybe. The best properties – wherever they’re based – have made brilliant wines that sit comfortably alongside the best vintages in recent memory. Although not every wine reaches such heights, the balance between power and freshness is impressive – and sets them up for a long life in the cellar. Overall, however, there’s a classicism and elegance to the 2020s, with expressive and delicate aromas that make these wines utterly seductive. Oak barrels have been used in winemaking for thousands of years. While initially their purpose was simply as a holding vessel, today it is much more than this. As we have learnt about wine production at a molecular level, we have discovered the unique interaction between oak and wine – adding flavour, textural complexity and increased ageing potential. These intrinsic qualities have seen oak at the forefront of fine wine’s greatest success stories – but also some of its greatest failures. The use of oak to improve a wine requires great skill and finding that balance has shaped the modern history of fine wine.  What is rather beautiful about winemaking, particularly in fine wine circles, is that despite the input from developments in science and technology, production remains an artisan craft, relying both on tradition and technology. The barrel-maker is a perfect example of this partnership and no one understands this better than François Frères. This lauded Burgundy cooper’s ties to the world’s greatest wines make it one of a very small number that have lived through the development and fashions within fine wine.  Today, business has never been better for François Frères; they produce 30,000 barrels a year and export to every major wine region in the world. The secret to the François Frères barrels historically, Gigandet believes, is their consistency, while the all-important signature toasting is paramount. To keep up with the ever-growing world of fine wine, François Frères produces tailor-made barrels that fit the varying climates and varying styles of each winemaker, meeting the standards set by today’s precision-led winemaking. Despite the growth of the business in recent years, François Frères still remains intrinsically linked to its homeland in Burgundy and the specific microclimate of Saint-Romain that is so important for the seasoning of their oak – another key factor behind the company’s success. “The microclimate of Saint-Romain, in a windy and pollution-free environment is ideal for the seasoning and drying of the oak. This oxidation of phenolic compounds under the influence of fungi, releases enzymes that hydrolyse the phenolic compounds, reducing the wood’s astringency, producing oak of the finest quality for wine production,” Gigandet tells me. The art of the cooper is much more than just sawing and toasting – it’s about sourcing, traceability, control of drying time and heating, hygiene, temperature control, sorting and more. With increased knowledge, the quality of the barrels, like that of the wines, has greatly improved. Even just a few years ago, Gigandet admits that in colder Burgundy vintages, sometimes their barrels jarred with the wine – they “brought too much tension and could sometimes seem too austere”. But now they have a better understanding of the qualities their barrels can bring to Burgundy: “François Frères barrels remain attractive to winemakers because they are great at retaining freshness and minerality.” Perhaps most importantly, François Frères wants its barrels to amplify a wine’s intrinsic qualities. “It wants to accentuate the beautiful tannic structure of a wine, contribute to its flavour but without excess of sweetness from the toasting, as well as amplifying the wine's tension and minerality, helping retain its freshness and its fruit,” Gigandet says. As technology has developed, so has François Frères. It is what Gigandet aptly calls “the evolution of taste” – “the cask has evolved considerably over the last few decades along with the quality of the wines. Today, the barrel is much more specific, manufacturing almost tailor-made barrels for each customer’s needs.” The business was founded by Joseph François in the early 1900s, never imagining that being a cooper would become a full-time job. Back then, Gigandet reminds us, “It took several trades to live.” But the next generation, Robert and Henri François, saw the demand for oak casks rise, at that time mainly used to transport wines. They took the operation full-time, creating the François Frères brand in 1942. In those days, as Gigandet points out, “The tradition of maturing wines in barrels was reserved only for the very top red and white wines of Burgundy and the great Bordeaux châeaux.” Even within these regions, barrels were a luxury, re-used year after year given their expense, therefore keeping the demand for new barrels low. By the 1960s the brothers were met by the development of stainless steel and plastic containers. The barrel quickly lost it supremacy as the preferred vessel for transportation and demand plummeted. It was only the top producers that helped keep the cooperage going. By the 1970s François Frères was producing barrels for one of the world’s most famous estates, Domaine de la Romanée-Conti – a partnership that would be instrumental in the continuation of the business through a difficult period. The next generation – Robert's son, Jean – was confronted by the economic downturn of the early 1970s and turned to export to save the family business. Fortuitously at this time, oenologists in the United States started to highlight how ageing wines in new oak barrels brought complementary flavours and complexity to the wines. In the 1980s, the French market caught onto the idea and both export and domestic markets grew. The oak barrel was entering an era where it would become the star of the show – and a must for all top producers. François Frères’s reputation for working with the best saw it perfectly placed to capitalise on this new-found love for the barrel. But according to Gigandet, it wasn’t just the fashion of using new oak in the 1980s and ’90s that saw such a huge increase in demand. This trend emerged just as wine exports exploded. What he calls “the democratisation of wine” saw the world of wine suddenly open up to the middle classes – and this increase in sales saw an ever-increasing need to maintain quality and improve consistency. Such demand prompted and funded a better scientific and technological understanding of wine production. More importantly for François Frères, it fuelled the need for a better understanding of what barrel-ageing does to wine – and why. It was already clear that contact with new oak changed wine profoundly. Most obviously the aromas and flavours of the wine develop, becoming more complex. These aromas and flavours are formed during the toasting of the barrels. “It is this toasting of the barrel that remains the signature of the cooper,” explains Gigandet. But the oak didn’t just impact the flavour, they came to understand that, being porous, oak allowed the wine to undergo “controlled oxygenation”. The exchange of air through the oak staves, in particular for red wines, helps stabilise the colour and polymerise the tannins. This polymerisation not only softens the wine, but brings a textural complexity, a millefeuille layering of mouth-feel brought about by the linking of long tannin chains, encouraged by the micro-oxygenation process that the wine goes through when aged in oak barrel. “François Frères barrels are ageing tools, which contribute to the textural improvement of wines, when used wisely,” Gigandet explains. As the wine world’s love of oak grew, François Frères’ main export customers went from little-known names to pioneers in their respective regions – with Robert Mondavi in the US, Angelo Gaja in Italy, Nicolas Catena in Argentina and Australia’s Rosemount winery. Each of these producers further cemented the cooper’s reputation, representing the very pinnacle of oak barrel production. Of course, like all fashions, the oak craze of the ’90s saw some extreme uses – 200% new oak ageing or an over-reliance on oak to provide flavour to wines that lacked the natural concentration to carry it. This saw many producers and consumers react strongly against its presence in wine at all. Even Gigandet admits that there are wines with “excess woodiness” to their detriment. Today, the barrel also has to compete with new trends in wine maturation – concrete eggs and clay amphorae, for instance. But while these new vessels have captured the imagination of the world’s top winemakers, it is not necessarily at the expense of the barrel. “The barrel has an important oenological role in the development of wines from certain grape varieties,” states Gigandet – notably Cabernet Sauvignon, Merlot, Syrah and Pinot Noir. But he also outlines how different ageing vessels combined can also benefit a wine’s potential for complexity. This is certainly the case amongst some leading producers in Bordeaux and Burgundy that are using both oak barrels and alternative ageing vessels. Coopers like François Frères have weathered the changing relationship wine has had with the barrel; with shifting views of critics and drinkers over the last century. Fortunately for fine wine lovers, there’s little sign of oak fading into the background. Oak remains a vital ingredient in many of the world’s greatest wines, adding to its flavour, textural complexity and – of course – ageing potential. Today oak has never been so deftly handled, bringing so much to a wine, while retaining the grapes’ natural expression. The art of the cooper lives on. Read more Editorial

Marco Simonit has become something of a celebrity in the world of wine, but his specialisation – pruning – is not normally considered glamorous. Pruning is often low-paid work left to contract crews. But with his childhood friend Pierpaolo Sirch, he set up the Simonit&Sirch pruning consultancy that now has a team of 20 experts operating all over the wine world.  Partly this is because of the rise in grapevine trunk diseases, which are considered a major threat to viticulture. Simonit’s pruning methods are suddenly in high demand because they have the potential to vastly reduce the risk of trunk diseases. Now, in conjunction with FINE+RARE, he has made his first wines from old vines in Collio. The origins of Marco’s interest in the vine began with his background. "I lived with my grandparents because my father died and my mother worked," he says. "They had a small farm with cows, horses, sheep and goats, and also a small vineyard to make wine for the family’s consumption."  He says that it was a good environment to grow up in, surrounded by nature with a gentle pace of life. His real passion was animals, though – not vines – and he had set his heart on becoming a vet. But after studying agriculture at the local college in Cividale in Friuli, he had to take a job. He began working as the technical adviser for the Consorzio of the Collio DOC in 1988, a role he was to fulfill for a decade, offering guidance to growers on viticulture. "I loved the landscapes, and I loved to observe the trees, plants and hills," he recalls.  Then one day, he started drawing vines. "After work, I would go to the fields, and I drew the vines," says Simonit. "I drew the trunk and the arms and the canes and leaves, and I met the wounds. There were a lot of wounds. I started to think about what it must be like for the vine." Observing the pruning wounds and their effects on the old vines made a big impression on him. He asked a viticulturist if he could pull out an ailing old vine, and when he got permission, he approached one of his friends who was a carpenter. "I asked him if it would be possible to help me make a section through an old vine," Simonit recalls. "He said, this is a strange request. Why do you want to do this? I said I wanted to see inside."  So with the aid of the carpenter, Simonit cut the vine in half. "It wasn’t completely dead but it wasn’t in good health," he says. "It had an extraordinary impact on me: when I saw inside, a big part of the vine was destroyed. A small part of the wood was white (alive), but most of the inside of the trunk and the arm was brown and black, and with fungi. I was shocked." At that time no one in the schools and universities had sectioned vines to look at the consequences of pruning. "I called my professors and I spoke about this, and the professors said, Marco, since the beginning people have always approached pruning the vines in same way, so why are you going crazy taking the trunk and making sections to see what is happening inside? Just do a normal pruning like everyone has always done." None of the professors he spoke to were interested in his ideas. But he decided to carry on.  His growing obsession with old vines led him to start travelling, initially around Italy, and then further afield. He saw a similar pattern everywhere. "In these years the viticulture was changing," he says. "A lot of local training systems, such as pergola in Trentino, tendone in Abruzzo and albarello in Sicilia, were being transformed."  People were turning to more ‘modern’ ways of training vines, such as vertical shoot positioning (VSP), and then after 20 years these new vineyards were starting to lose vines to trunk disease. "The spacing for growing the vines wasn’t enough," he says. "In its natural state, the vine is a creeper, a liana. For sure, it is not easy for the vine to remain in the same position for a lot of time, with domesticated demands, without consequences for its health and longevity." He came back to Collio. "I asked some viticulturists if it would be possible for me to try to change the approach of the pruning in modern vineyards. I wanted to change the approach to pruning because the consequences were terrible. The response was they said they didn’t really understand what I wanted to do, but they let me try. In the beginning of 1990 I started to introduce a new technical approach to pruning and shoot thinning by myself in different places in Friuli." Simonit didn’t have a program, and at the time hadn’t heard of Guyot-Poussard pruning, which is an old system that’s somewhat similar to the technique he developed himself. Over a ten-year period he tried to find new solutions, observing old vines and applying different approaches. After this period of experimentation, he thought he had something worthwhile, and he began to approach professors and viticulturists, only to meet with disinterest. Attilio Scienza, professor of viticulture at Milan University, was the exception, though. "Scienza said to me, it is interesting what you do," he recalls.   "Scienza was impressed with my work and started to speak about it with important producers in Italy, such as Bellavista and Ferrari," says Simonit. "And in Schiopetto we built our campus, our laboratory. In Schiopetto today it is possible to see and touch the last 30 years of my work." This was the early 2000s, and although Simonit was starting to get his first consulting gigs, he wasn’t sure that pruning was going to be his professional future.  "But I thought: I believe in this. I had a passion for vines and wanted to help reduce the risks from bad pruning. And I thought, maybe the top wineries in Italy might be interested in my new approach for pruning and shoot thinning. I tried to call these guys and show them what I was doing in the campus of Schiopetto. One day I was in my car, and I looked up Angelo Gaja’s number. I thought this guy might be interested because the wines are expensive and high quality. Maybe he would be interested to keep his heritage vines." "I called and asked the secretary whether I could speak with Angelo." He was stunned to be put through to him. "I told him that I’d worked in a lot of vineyards over the last five years to find a new solution for pruning and shoot thinning, and I asked him if he was interested in coming to Friuli to see it in action.  He said yes, and two weeks later he came along with his entire team from Piemonte and Tuscany to Friuli. They were really impressed, and a few weeks later I had contracts with Angelo Gaja, Ferrari and Bellavista." This was in 2003, and Simonit finally began to see that this was going to be his future. He took his approach all over Italy, working with some of the top estates, including Frescobaldi, Planeta, Tasca d’Almerita, Feudo di San Gregorio and Ornellaia.  What is different about the Simonit approach?  There is no recipe because vineyards, regions and training systems are all different. But there are two main principles. The first is that the sap flow of the vine has to be respected, and pruning cuts are made with this in mind. The second is what Simonit describes as ‘ramification’. "One of the big principles for respecting vines is independent of the training system you use, or the variety," he says.  "It is ramification. You first build the trunk (the first structure), then the arms (the second structure). It is like a chronology. You need to build a chronology of wood." He points out that the vine is naturally a creeper, and that pruning should respect this as much as possible. "Our principle rule is ramification. Build a chronology of live wood: first floor, second floor, third floor and so on."  So, for example, with a double Guyot, the canes chosen on each side of the vine should be furthest from the head each time, with the replacement spur the outside cane, and the cuts should always be made on the upper branch. When a cut is made, it should be of young wood only – one or two years old. And the cut should not be made flush to the trunk, because there is always what is called a ‘cone of dessication’, roughly equal to one-and-a-half times the diameter of the cut, where the wood left dies back. This can interfere with the sap flow and make the vine susceptible to trunk disease.  But respecting the sap flow isn’t always key. "Not all the varieties suffer if you don’t respect the sap flow," says Simonit. "Some varieties are very sensitive, like Sauvignon Blanc, Cabernet Sauvignon, Cabernet Franc and Sangiovese. Others don’t suffer a lot. For example, Nebbiolo and Semillon. I work for Château d’Yquem. They called me because the Sauvignon Blanc is being destroyed by trunk disease after 20 years. The Semillon is not: it has super energy and lives a long time, because the genetics are different." "But always respect the ramification. If you think about the albarello in Primitivo in Puglia, they grow up vertically. The arms of the Primitivo grow up vertically. It isn’t possible to respect the sap flow. For other examples of alberello training with different varieties, such as Moscato d’Alexandria, to follow the sap flow is necessary. We need to find solutions for each variety in each terroir: it’s not always possible to take the same approach." Bordeaux came calling A big moment for Simonit was when he was contacted by the late Denis Dubourdieu in 2011. "Denis called me from Bordeaux, because with the Guyot Médocaine, after years and years, there wasn’t enough space for the canes. They wanted to know what to do." If canes are taken from the outside each time, after a while the vines grow out along the row, and when the planting is close, they run out of space.  In Bordeaux, their solution was to take a shoot from inside, close to the head, and then lay that down after cutting the old arm off. Often, this would result in fatal trunk disease. "They destroyed a lot of vines this way, trying to regain the space and reduce the risk of congestion of canes overlapping," says Simonit. "This was a disaster for the Médoc and all the double Guyots in the world, because the big wounds destroyed the vines." "We started with a new approach in the Médoc, introducing the spur in the sap flow, building the chronology, preparing new exits for two or three years in the way of the sap flow, and then cutting the big arm, far away from the position of the new spur. This is one of the smart solutions when you have lost a lot of spacing. But this problem is particularly present when the distance between the vines was not enough in the first place when they were planted." Simonit now has many prestigious clients in Bordeaux. The dangers of high-density planting High-density planting is very popular these days, but it is causing problems because the vines are planted too close to allow for sustainable pruning approaches. "The risk is that if you don’t have the idea of the vine architecture at the beginning for the next 50 or 60 years, it becomes a problem. I see this problem all over the world, not only in the double Guyot, but also in Bourgogne and Champagne and Provence: everywhere. The big problem is people and space: people are scared to leave space for vines. Then to create space they use pruning, and it is a disaster." "In the past in Bordeaux, particularly in the Médoc, the Cabernet Sauvignon was planted further apart. Now we find Cabernet Sauvignon vines planted 80cm apart. We need to think about this for the future sustainability of vines and vineyards. We need to speak about the space. If we build vineyards for the next generation we need to think about the spacing." One idea that Simonit has adopted from Dubourdieu was ‘curetage’. Dubourdieu gifted Simonit with a book: this was René Lafon’s 1921 title Modifications à apporter à la taille de la vigne des Charentes, taille Guyot-Poussart mixte et double: l'apoplexie, traitement préventif (méthode Poussard), traitement curative.  This book described the experiments on pruning carried out by Eugène Poussard, a viticulturist in the Charentes area. Poussard is responsible for the vine pruning system called ‘Guyot Poussard’, which is very similar to Simonit’s system. But he also treated affected vines using ‘curetage’, cutting away affected wood. "More than 150 years ago this man was trying to do some surgery on the vines with rudimentary tools," says Simonit. "Denis asked me to go to Sancerre, because he knew that a lot of older viticulturists had used small chainsaws to open the vines and clean the wood affected by fungi, and the vines survived." They headed to the Loire and visited different vineyards. Sancerre has been particularly badly hit because Sauvignon Blanc is very susceptible. "We shared experiences with François Dal [another pruning expert who works for Sicavac, the regional technical body], and he was also interested in working with chainsaws. We tried doing this surgery in the wineries of Denis Dubourdieu, like Château Reynon, Doisy-Daëne and Floridène. In 2014 we began teaching others how to do this." As soon as the first foliar symptoms are seen, then any soft wood that has been infected by the fungi is cut out of the trunk. The infected wood produces toxins, and once it is taken out, the vine usually recovers.   FINE+RARE x Simonit&Sirch Now, for the first time, Simonit has begun making wine from old vines, in conjunction with FINE+RARE. "On my trips and jobs around the world, I met a lot of old vines, and sometimes these vines are not vinified separately," he says. Making small parcels of wine appeals to him. "It is a ways of speaking to people about the importance of old vines for increasing the identity of wines, speaking about vineyard sustainability, and thinking about the relation between humans and vines." He adds, "I wanted to make wines that speak about this philosophy." "Patrick O’Connor [of FINE+RARE] and I share a mutual friend, and he knew about my idea," says Simonit. "One day Patrick called me to ask me if it’s possible to organise a meeting because he was interested in this old vines project. He was very excited about the idea, and he proposed starting this project in Friuli, where my heart is." "He asked me which varieties were most interesting for me. I chose Sauvignon because I love it, and it is very difficult to have old vine Sauvignon because of trunk disease. Many of the vineyards have vines of different ages, because after 25 years the original vines often begin dying, and people co-plant with new vines. Then they make wine with all the vines – young and old – together. Also, I chose Chardonnay: in Colli Orientali we have the oldest Chardonnay in Friuli, 80 years old. And after I chose Friulano, which is 50 years old." Winemaking is in the hands of Christian Patat, an old friend of Simonit’s. "Twenty years ago we started with a small project but it stopped because we were both so busy. So when FINE+RARE and I began working, I spoke to Christian seeing if he could make the wines. He married the owner of Ronco de Gnemiz, and he makes the wines there. This guy has an approach to wine that’s close to mine – we like the same sort of wines. Our goal was to make two or three barrels of each variety." This is Marco’s first wine project. "I have never thought about making wine before. Now I’d like to expand this project to other Italian regions, and also other countries, with a small production focusing only on old vines." "It is a unique approach because we try to vinify with just the oldest vines. In the Chardonnay project, for example, we don’t use all the vines. Part of the vineyard is 80 years old. We pick only the grapes from the original old vines to make this wine from. These wines speak about the relationship between humans and vines, sustainability, the importance of the age of the vine, the importance of terroir." Tasting notes The wines are called L’Età Più Bella (With Age Comes Beauty), and will be released as a mixed case of three separate cuvées – a Chardonnay, a Friuliano and a Sauvignon Blanc. L’Età Più Bella Sauvignon 2018 - Collio, Italy "13% alcohol. Lean, taut and chiselled, this is a bright lemony Sauvignon with good acidity and some fine herbal hints. It’s quite compact and mineral with precision and focus, finishing quite taut. Stylish stuff." L’Età Più Bella Friulano 2018 - Friuli Colli Orientali, Italy "14% alcohol. There’s good density here with taut pear, apple and lemon fruit, as well as a touch of richness on the mid-palate. This has a lovely focus, combining some richer notes with good acidity and a long, mineral, subtly nutty finish. Beguiling and elegant. " L’Età Più Bella Chardonnay 2018 - Friuli Colli Orientali, Italy "13% alcohol. Hazelnut, spice, honey and citrus on the nose. The palate has fresh fruit with an appealing cedary, woody, spicy undercurrent. Citrus, pear and white peach, with a warm spicy finish. Lovely intensity here, with good fruit purity."
