Bordeaux is changing. The Left Bank, in particular, has long been a region of labels – of grandiose estates, polished winemakers and the bottles they produce – the vineyards a backdrop to their impressive châteaux and new state-of-the-art wineries. Of course, vineyards have mattered, as much as they’re the source of their grapes, but they’ve rarely been the focus for conversations with trade or consumers. But now, perhaps influenced by the meteoric rise of Burgundy – and an approach to wine echoed around the world, terroir is stepping into the spotlight. Behind the scenes, the Bordelais may always have been looking underfoot, but now they are talking about it too.  Nowhere is this more true than at Ch. Montrose – a property that announced a significant change when releasing its 2023 vintage. The property has always made some of Bordeaux’s finest wines, but over the past 15 years (under the Bouygues’ ownership) quality at this Saint-Estèphe estate has reached new heights. Long known for its austere age-worthiness, there’s now a modern polish that softens its stern style – without sacrificing its classicism and longevity. Each vintage seems to reveal a new level of precision and finesse. From 2023, Montrose announced that its Grand Vin would only come from Terrace 4 (T4). If that doesn’t mean much to you, I’m not surprised.  The Médoc and Graves’s six gravel terraces were uncovered by Pierre Becheler in a series of studies in the 1980s and ’90s. Each terrace dates from a different period and has its own distinct soils, with Terrace 1 (T1) the oldest and Terrace 6 (T6) the youngest – and argued to be a defining factor in the Left Bank’s terroir. T3 and T4 are widely regarded as the best for wine-growing, and Becheler found that, at the time of their classification in 1855, over 80% of the Classed Growths sat on these two distinct geological strata.  In the last decade, these gravel mounds have become a key part of Bordeaux’s story, explaining the estates’ terroir. Despite widespread understanding that the terraces are integral to the quality of wine, there still isn’t a comprehensive map of the Left Bank’s terroir – showing which vineyards sit on which soils (the best are those created by Jane Anson and Kees van Leeuwen for Anson’s book Inside Bordeaux). Most studies have been undertaken by individual estates, as at Montrose – who engaged Becheler himself to uncover the specifics of their site.  It's remarkable that, without knowing anything about the region’s subsoils, Montrose was so fortuitously placed – although it has of course survived thanks to its prestigious site. The property’s first vines were planted – all on the fabled T4 – in 1815, by Etienne Théodore Dumoulin, who had purchased the land from Nicolas Alexandre de Ségur (of Calon Ségur). The land had been covered in heather, its pink blossom covering the gentle slope come autumn, and sailors passing along the Gironde estuary used to call it the pink hill – or “mont rose”, giving the property its name.  It was only 40 years after the first vines went in the ground that the estate earned its place as a Second Growth in the 1855 Classification. By 1861, when Dumoulin passed away, the estate comprised 95 hectares – but its borders have shifted over the years. It was later purchased by an Alsace factory owner, Mathieu Dolfus, who invested heavily in the property. He was a visionary – offering free healthcare, profit sharing and accommodation on the estate for his workers. He even used a wind turbine to flood the vineyards, staving off the impact of phylloxera as long as he could.  Montrose was managed by the Charmolüe family between 1896 and 2006, with Jean-Louis – who ran the estate from 1960 – key in building its modern reputation. It was under him, in the 1970s, that vines were planted on lower-lying land close to the estuary, which sits on T5. These humid, sandy parcels are now used for La Dame de Montrose, the château’s second wine.  It was in 2006 that brothers Olivier and Martin Bouygues (of the eponymous telecoms company) acquired the property. In 2010 they bought an additional 22 hectares from Phélan Ségur, land which had historically been part of Montrose. These vineyards, wooded on either side, sit on the sandier T3, but importantly also brought the total vineyard area back to 95 hectares – as under Dumoulin – and all sitting in one block (something which is relatively rare in Bordeaux).  The Bouygues brothers hired Vincent Decup as the estate’s Technical Director in 2014. Decup instantly set about getting to grips with the estate and its soils. When he arrived, they had a map detailing 16 different soil types across the vineyards – but he soon commissioned further studies, uncovering an additional 10 soil types. This gave them, Decup tells me, “the possibility to explore and separate” parcels, diving into the detail of the site with a Burgundian, rather than Bordelais, vision. From 2017, the team started delineating the parcels – vinifying plots in 93 separate tanks (over twice the 40 that had been used just three years prior), adapting the winemaking to each. Looking at the Cabernet Sauvignon on T3 and T4, he explains how they gained a “new level of precision and comprehension of Cabernet on each terrace”.  “The Cabernet Sauvignon of Montrose naturally gets lots of power,” Decup tells me. “We have to be careful with the extraction.” Especially for fruit from T3, he explains, it can easily become overly austere. T4 has always represented the majority of the blend for the Grand Vin at Montrose – and in Decup’s mind it is not just the property’s historic DNA, but what gives the wine its identity. He tells me how there is something magical about the way Cabernet ripens on these parcels, developing technical (sugar), aromatic and phenolic ripeness all at once. It produces wine that is “powerful, voluminous, demonstrative – a lion in a cage”.  In 2022, the same year that Charlotte Bouygues took over as President and Pierre Graffeuille became CEO, the team started focusing more on T4, and from 2023 the Grand Vin comes exclusively from this prized terrace. Coming from the Delon estates, Graffeuille knew the potential of these soils, shared by Léoville Las Cases. The 2022 vintage was pivotal – earning four potential 100-point scores, with four firm 100-point scores in bottle – and the 2023 followed in its footsteps, with three potential perfect scores to its name.  The gravel terraces rise and fall through the region. T4 surfaces in Saint-Estèphe, running under Meyney and Montrose, disappearing until the southern edge of Pauillac, reappearing around Latour, then running through much of Saint-Julien (including the three Léovilles – Las Cases, Barton and Poyferré – and Ducru-Beaucaillou), rising again throughout Margaux and then again under Haut-Brion and La Mission Haut-Brion, with small pockets further south.  The defining factor of T4 is an iron pan beneath its sandy gravels. The sandy gravel topsoil allows young vines to develop roots easily, before they hit the compact iron layer – forcing the vines to spread horizontally rather than vertically. That compact layer is cool and retains water, feeding the vines in hot years. Decup explains how in July the topsoil might be hot, but if you dig down you can feel the chill of the iron layer – something that is perfect for Cabernet Sauvignon. At Montrose, T4 sits between 12 and 16 metres’ altitude, while elsewhere it reaches a maximum 22 metres. T4 tends to run close to the Gironde, which provides a moderating influence – especially so at Montrose, where the estuary is 4.5km wide (notably protecting the estate from frosts, such as in the brutal 1991 season – a year when Montrose produced the wine of the vintage).  As with T4, T3 runs beneath many Classed Growths – notably Cos d’Estournel, Mouton and Lafite. With sandier gravel topsoil, the key difference is that T3 doesn’t have the iron pan of T4 – the topsoil instead sitting directly on clay-limestone subsoil. Slightly higher in altitude (15-18 metres at Montrose, but generally 20-26 across the Médoc), the soils are very deep and the vines’ roots drive straight down, up to three metres or so at Montrose, Decup tells me. With less clay in the topsoil, the soils are particularly free-draining, and the vines reach down in search of water. “In terms of expression, it is not the same at all,” says Decup. He explains that while it also produces bold Cabernet Sauvignon, it’s got particular energy and length, an austerity – but “positive austerity”. Vines on T3 particularly thrive in hot, dry years, he tells me.  Montrose has an impressive 45 hectares of vines on T4, 12 on T3, a swathe on what the team describes as an “intermediate soil” – somewhere between the two terraces, and a small portion on T5. So what now of the property’s vines on T3? While the château isn’t openly confirming it, a separate bottling of T3 is set to be released – likely hitting the market in 2026, if rumours are to be believed. The rest of the fruit goes into La Dame de Montrose, and a small portion into a third wine, Tertio de Montrose (previously known as Saint-Estèphe de Montrose), which is exclusively for those working at the estate. All in all, the Grand Vin now represents circa 36% of production at Montrose – down from closer to 45%.   “T3 and T4 are, in our opinion, the terraces that produce the best viticultural results,” says Pierre Becheler, when it comes to the Médoc and Haut-Médoc. Interestingly he explains that in the Graves it’s very different, and T2, which is almost non-existent in the Médoc, produces some stunning results. He can’t fully explain why one terrace works better for wine than another, but one reason the terraces are so important is their influence on water availability. With varying proportions of clay and sizes of gravel, it’s a key element in viticulture and, eventually, wine quality. Although he has spent much of his career diving into these gravel beds, however, he’s very clear that the terraces are one very important piece of the puzzle – but will never provide the entire picture. Some terraces are the best in certain appellations, he says, “but we don’t really know why or how”.  The complexities of Bordeaux’s terroir are manifold – and some argue that the bedrock, from richer clays to hard limestones, are more influential than the gravel terraces that lie over them. On top of this, slope exposition, proximity to the Gironde, and many other elements influencing microclimate, not to mention the human influence, all contribute to the concept of “terroir”. It’s exciting to see site pushed to the fore, especially alongside an increased focus on sustainability in the vineyard. While long a leading estate, recent vintages of Ch. Montrose have earned sky-high scores. We sat down with the property’s Technical Director Vincent Decup to find out how the team is taking the Saint-Estèphe titan to new heights – all by looking underfoot

The four-wheel drive pulls up and we pile out – Marco Pallanti’s two Jack Russells (Bach and Masetto) leading the charge as they tumble down and into the vineyard in front of us. The vines stretch down a steep slope, three triangular slithers slanting severely to a point, forming a natural amphitheatre, and Siena’s iconic tower just visible on the horizon, 20km to the south. CEO Lorenza Sebasti, her and Pallanti’s son Arturo, our Buying Director Corentin Margier and I are standing in Castello di Ama’s Montebuoni vineyard, which gives its name to their Riserva bottling. It’s the final stop in our tour of the various sites that make up the property’s 75 hectares of vines.  Just tasting Castello di Ama’s wines tells you that this is a special place, but of course there is no substitute for getting your feet on the ground, walking the vines and seeing the site yourself. Since four Roman families re-discovered this hilltop site in the 1970s, it has been lovingly restored, with significant investment in the vineyards and winery – and the original 55-hectare estate has grown to 115 hectares today (with 75 hectares of vines and 40 of olive groves), not to mention the extensive art collection that dots the property.  The vineyards are spread across four valleys, with each site within a 1.5-kilometre radius of the winery in Gaiole-in-Chianti. For winemaker Pallanti, this proximity is one of the keys to quality, not only allowing them to really understand each site, but also ensuring there is minimal time between picking fruit and getting it into the winery. For each parcel, they aim to have the fruit in the tank in under two hours. The property all sits between 420 and 530 metres above sea-level, on the higher side for the region and another defining element for Castello di Ama, lending their wines great freshness and finesse.  The northern flank of the estate is the 16.1-hectare La Casuccia, dominated by stony clay soils and surrounded by stone walls. Here the “rich, fat soil” (as described by Arturo Pallanti) is home to largely Sangiovese, with one historical parcel of Merlot. The tenderloin of the property, it produces opulent and expressive wines, and a single-vineyard Gran Selezione is made in only top vintages (as for Bellavista).  Moving south you come to San Lorenzo which forms the foundation of the eponymous Gran Selezione, a wine made every vintage. While the vintages from 1982 to 1990 were made exclusively with fruit from this vineyard, it has evolved to become a blend of plots – including fruit from Bellavista and La Casuccia in particular in the years they aren’t made. The soils here are chalky yet with plenty of clay-rich schist – a site that doesn’t have the extremes of Montebuoni, Bellavista or La Casuccia, but brings together some of the best characters of them all in its 16.5 hectares.  Sandwiched between San Lorenzo and Bellavista lies L’Apparita, the special three-hectare plot of Merlot that is behind Tuscany’s first – and one of its most iconic – Merlot wines. Clay, chalk and the altitude (500 metres) create a wine that has both power and freshness. The neighbouring Bellavista produces some of Castello di Ama’s most powerful, yet fine and floral, wines – and is home to their oldest vines. South/southwest-facing, its 22.5 hectares of vines (around 80% Sangiovese, with the remainder Malvasia Nera) bask in the sunshine, sitting in stony, clay-chalk soils. In top vintages, they produce a single-site Gran Selezione from Bellavista (first made in 1978) – an impressive and age-worthy wine.  The final piece of the puzzle is Montebuoni – where we’re standing. Pallanti and Sebasti purchased this 14.7-hectare slice of vineyard in 1997, naming it after the village opposite. Arturo tells us how as a child he once tried to ride his bike up the slope – a mistake he never made again. The gradient here is so drastic that even driving down it in a pick-up frays the nerves, working from the chalky scree that feels destined to leave the wheels skidding, down to the more clay-rich foot of the vineyard. The vines here are divided between Sangiovese (around half the site), with Merlot, Cabernet Franc and Malvasia Nera – and the wines reflect the site’s angular slopes, pointed and driven with a backbone of bright acidity.  It’s been over 40 years since Pallanti arrived at the estate, and over 30 since Sebasti took over as CEO. Together they have nurtured this remarkable property, weaving together the threads of these special vineyards to craft wines that set the benchmark for the region. Bordeaux is arguably the world’s most famous wine region – known for producing some of the finest wines in existence, with a long history stretching back to the Roman era. But the region is broadly divided in two – the Left and Right Bank. (Terms that you may also hear in reference to Paris, and – less frequently – Chablis.)  The region is defined by its waterways – a forked tongue that snakes southeast from the Atlantic. The Gironde estuary is fed by the Dordogne and Garonne rivers, with the Gironde flowing into the Atlantic. The south-eastern side of the Gironde and Garonne is the Left Bank, while the north-western side of the Gironde and Dordogne is the Right Bank. The section of land that sits between the fork of the Garonne and Dordogne is the intuitively named Entre-Deux-Mers (literally translating as “between two seas”), and is mostly home to more everyday, entry-level wine – although quality has certainly improved here with both climate change and technical advancements (such as Ch. Marjosse).  The Left and Right Banks, however, are where you’ll find Bordeaux’s most illustrious names. While both regions craft exceptional wines, they are extremely different in terms of terroir, the grapes grown, the estates themselves and how the wines are classified.  The Left Bank The Left Bank is the aristocratic and historic home of fine wine in Bordeaux, famous for the 1855 classification of the Médoc, a ranking of the top estates of the region which still stands today, including the fabled First Growths – Ch. Latour, Ch. Lafite Rothschild, Ch. Mouton Rothschild, Ch. Margaux and Ch. Haut-Brion.  It was Bordeaux’s ties to England that saw it rise to prominence – after Eleanor of Aquitaine married Henry Plantagenet in 1152. With Bordeaux under English rule, favourable tax rates saw the industry thrive. But the Médoc was, at that point in time, a marshland not worthy of wine-growing – with the best wines coming from Graves estates like Ch. Haut-Brion (where vines have been grown since at least the early 15th century).  It was only in the mid-17th century that the Dutch drained the marshy Médoc, creating the well-drained gravel soils that are now a haven for Cabernet Sauvignon. It was after this that most of the region’s grandest properties were established.  The aforementioned 1855 classification cemented the Médoc’s place in history, with the wines of Sauternes and Barsac categorised at the same time. The wines of the Graves were classified in 1959, while the Left Bank is also home to the Cru Bourgeois and Cru Artisan classifications.  The Left Bank encompasses, from north to south: the Médoc (which includes the prestigious communes of Saint-Estèphe, Pauillac, Saint-Julien, Margaux, as well as Listrac and Moulis), the Haut-Médoc, Pessac-Léognan and Graves, as well as Barsac and Sauternes. Although the area of course encompasses dry whites and sweets, stylistically “Left Bank” is used mainly in reference to the reds, which represent the vast majority of production.   The soils on this side of the Gironde are dominated by gravel, with the best sites sitting on deep gravels over clay subsoils. The vineyards are more spread out here, with patches of woodland and other agricultural land between the pockets of fine terroir, making distances and journey-times between estates longer. The gentle, barely undulating landscape masks significant differences in the soils, which determine the success of a site, with the mounds divided by streams known locally as “jalles”. Deeper gravel has historically been a significant advantage in the region’s maritime climate, avoiding water-logging and retaining heat that helps to ripen the grapes. Proximity to the Gironde and its moderating influence can also help shield vines from frosts, an increasing threat in the springtime.  Estates can be quite large on the Left Bank – for example, Ch. Cos d’Estournel comprises 100 hectares – allowing for higher production levels, which means the wines tend to be more widely available and can be found more easily on the secondary market, even at the highest quality level. The properties also tend to have picture-perfect châteaux, immaculate architectural displays of the wealth of the region.  Cabernet Sauvignon leads the way in terms of plantings, thriving in those warm gravel soils (and complemented by parcels of Merlot, Cabernet Franc and Petit Verdot, with some limited Malbec and Carménère). The variety produces small berries with thick skins, creating tannic, age-worthy reds.  The wine style varies between commune and estate, but generally speaking the wines of the Left Bank are dominated by graphite, cassis and blackcurrant leaf, full-bodied yet with a more linear structure that Cabernet Sauvignon provides. Historically the wines were austere in youth and needed time in the cellar, but wines today are made to be more approachable so that they have longer drinking windows. With age, the best wines develop beautiful complexity with notes of leather, cedar, tobacco and more.  The Right Bank The most famous wines of the Right Bank come from Saint-Emilion and Pomerol, however it is also home to: the Côtes de Blaye, Côtes de Bourg, Fronsac, Canon-Fronsac, Lalande-de-Pomerol, Côtes de Castillon, Côtes de Francs and the Saint-Emilion satellites – Lussac-Saint-Emilion, Montagne-Saint-Emilion, Saint-Georges-Saint-Emilion and Puisseguin-Saint-Emilion.  Although wine has long been made on the Right Bank, the wines – other than those of Ch. Cheval Blanc – were not known widely until relatively recently. The region’s modern history is tied to one man – the influential critic Robert Parker. He was one of the first to highlight the quality being produced at smaller Right Bank estates in the 1980s and 1990s, and put the wines on the international stage. His penchant for rich, ripe, concentrated styles prompted a wave of producers who did extensive green-harvesting, working with tiny yields, picking late, extracting heavily and ageing in new French oak, a style favoured by the far-reaching and famous consultant Michel Rolland.  Pomerol became home to the “garagistes”, after Jean-Luc Thunevin crafted his first vintage of Valandraud in his garage in 1991. These modern producers, who didn’t come with the land and smart châteaux found on the Left Bank, captured the imagination of consumers, and rapidly became highly sought-after.  Fashions have changed for the most part, and the wines produced today across the Right Bank are significantly more restrained – reflecting the general move toward freshness and aromatic finesse.   Of course, one reason that the wines of the Right Bank were less well-known was the smaller size of estates and therefore smaller volumes being produced – especially in Pomerol. Pétrus, for example, consists of 11.5 hectares, while Ch. Lafleur is a mere 4.5. In Saint-Emilion, Ch. Cheval Blanc and Angélus both have 39 hectares – a more generous vineyard area, but still relatively small in comparison to those in the Médoc. This means that the wines from the top estates are often strictly allocated and can be very hard to secure, with significantly less available on the secondary market.  The area feels very different to the Left Bank, with a more rolling landscape with more nooks and crannies, meaning you often can’t see what lies over the hill. The soils here are also significantly different, dominated by clay and limestone, with some sand and gravel. These soils stay cooler and retain more water, something that can be very helpful in hot, dry seasons (as in 2022). The finest wines come from the limestone plateau at the heart of Saint-Emilion and Pomerol plateau, with its pockets of rare blue clay. Limestone has an additional benefit of retaining freshness and acidity in the wines, with wines from limestone-dominant soils often having low pH.  Plantings are dominated by Merlot and Cabernet Franc (sometimes known locally as Bouchet), rather than Cabernet Sauvignon (which can struggle in the damp soils, although producers are planting a little more of the variety in response to climate change). Many wines from Pomerol are 100% Merlot (with estates such as Vieux Château Certan notable exceptions), while in Saint-Emilion the blends tend to include more Cabernet Franc. Merlot produces larger, thinner-skinned berries, and therefore Right Bank wines are generally softer, plusher, with a rounder texture, softer tannins, often floral with a redder fruit profile (cherry, plum), and can sometimes be exotic in perfume.   Unlike on the Left Bank, most of the wines are not classified formally, however Saint-Emilion introduced its own classification in the 1950s – one that has become a source of controversy.  Beyond Saint-Emilion and Pomerol, the other appellations can produce some fantastic wines, and – given the difficulty with buying additional land within these two illustrious areas – many of the Right Bank’s leading names have estates here (such as Ch. Lafleur’s Grand Village or Perrières, and LEglise-Clinet’s Montlandrie or Les Cruzelles). These can be a great source of value.  It’s worth noting that vintages are sometimes described as “Left Bank” or “Right Bank” years, and it is true that conditions can sometimes favour one side over the other, however the picture is often more complicated and results can vary according to individual estate, as well as commune.  Read more about Bordeaux or browse all Bordeaux listings

In the conversation about terroir in spirits, rum arguably has a stronger position than most. There are numerous cane-to-bottle rums and many more with a credible claim to the dictionary definition of the term typically associated with wine. However, as is often true in the rum world, this isn’t an open and shut case. “Wherever unique spirits are found I think there is an opportunity to discuss the influence of terroir on the liquid,” Mitch Wilson, Black Tot Global Brand Ambassador, says. “How people interpret terroir in wine versus spirits is often different – wine terroir focuses on transmission of flavour from the land and the region into the final product. Spirits can be a much broader interpretation of terroir – here we often look at local ‘method’ and ’savoir-faire’ or know-how – how the local traditions together with production choices of the distiller and blender help to create a sense of identity in the final spirit.” Foursquare Master Distiller Richard Seale picks up the point: “Terroir is an interesting question in rum and you will get a different answer in different rum producing countries.” At the Barbados distillery, Seale ferments with added cultured yeasts in one section and pure cane juice natural fermentations in another. When it comes to the latter, Seale says “terroir in the traditional sense of the word is everything”. “The rum depends on the year of harvest, the time of harvest and the field from where it is harvested. It is 100% natural input. [There’s] not even a cultured yeast to give us some consistency or predictability,” he adds. Daniele Bondi, Export Manager at Hampden Estate's global distributor La Maison & Velier, is a staunch believer that terroir exists in rum and is perplexed by any arguments to the contrary. “I never understand when people think that spirits don’t preserve the characteristics of the fermented wash,” Bondi says. “Obviously, the terroir is respected and expressed only if the whole process of production is carefully preserved.” Wilson says sugarcane juice-based rums are undoubtedly the best examples of terroir in its “classical interpretation”. “Their flavour is almost entirely dependent on the local raw material used, and helps illustrate the vast array of differences between different genus of sugarcanes,” he explains. “Sugarcane juice is not easily transportable – when cane is crushed, the natural yeast on the outside of the cane is immediately brought into contact with the fermentable sugars in the juice, meaning fermentation happens spontaneously within a short period of time. This tends to encourage much more local distillation, often on the same estate where the cane is produced, allowing us to more easily focus on environmental terroir in these specific regions.” He says the fact rhum agricole, as well as their sugarcane-spirit cousins clairin and cachaça, are often found unaged means they are excellent examples of terroir. The purity of the raw material is preserved all the way through to distillation and ultimately glass. The climate of ageing has an enormous impact on terroir, according to Seale. He points to the fact a rum will age very differently in Martinique, which is approximately 140 miles away from his distillery in Barbados. Bondi says this crucial stage can negate terroir entirely. “If a product is aged far from the rest of the production, terroir doesn’t exist anymore.” This is something Dictador has played with in its 2 Masters series. Creative Director Ken Grier says rum, arguably, has a more diverse terroir influence than any other spirit category and this is about the influence of culture rather than soil. “Simplistically, the role of the original colonists has the biggest influence on rum production,” he explains. “The rhum agricole style found in ex-French colonies is derived from the juice of the sugarcane. In former British colonies like Jamaica the predominant style has been pot still, drawn from molasses. Ex-Spanish colonies have been more about column stills and finally Cuba is a tapestry of styles. Of any spirit, rum really reflects the history of the place where it is produced.” Sugarcane honey is used as the spirit base for Dictador. A blend of column and pot still rums are matured in oak casks on the coast by the Caribbean Sea. Grier says these factors all contribute to a particularly elegant, well-aged and complex rum. For the 2 Masters series, Dictador laid down between 10 and 20 casks with prestigious partners from the spirits and wine world. The rum was transported for maturation in the partners’ warehouses to benefit from their terroir, according to Grier. From there, the partners have the creative freedom to choose, in conversation with Dictador Master Blender Hernan Parra, which age and style of rum to use and what to do with it. These partners have included the likes of Glenfarclas, Royal Tokaji and Niepoort. The Royal Tokaji project, for example, took a 1977 rum and matured it in 12-year-old 300-litre Zemplen barrels for seven months in Hungary. These barrels had previously been used to age the producer’s 2016 Tokaji Aszu 6 Puttonyos.
 While there is a general consensus about ageing and sugarcane-juice rums, there is less accord when it comes to the role of molasses in the terroir conversation. “Molasses tends to be a fairly homogenous product,” Seale explains. “When discussing the contrasting styles of molasses rum from Barbados and Jamaica, the terroir element is more about the process and the know-how and less about the agricultural input. Much like a lot of Scotch whisky in that sense,” he explains. The decline of sugar production in many regions has understandably presented a problem when it comes to supply and demand. For this reason, many distilleries have resorted to importing their molasses. The same is true of grain in Scotch whisky production, which is often where the wheels come off in the debate around terroir in whisky. “It might be tempting to consider molasses-based rums as lacking a sense terroir (certainly in the wine sense), but this would be unfair,” Wilson says. “I’d be tempted to bet that given the opportunity to taste a line-up of single origin molasses from around the world that there would be enough variety to contribute to the idea of local terroir.” Ultimately, he says, it’s down to the producer at each stage of the production process to decide to what extent to allow the terroir to influence the final liquid. Exploring what terroir means in the rum world

Rum: the raw deal

Think of Bordeaux, and you probably don’t think of skateboarding and denim shirts. Damien Barton-Sartorius, however – Director of Château Langoa and Léoville Barton – manages somehow to combine millennial cool with an effortless suaveness that feels distinctly Bordelais. “When you’re one of these old families, the rest of Bordeaux looks at you in a different way,” he tells me. There have been Bartons in Bordeaux since the 18th century. One of the region’s “wine geese”, Irishman Thomas Barton arrived in 1722, and Hugh Barton bought Château Langoa in 1821, acquiring part of the Léoville estate in 1826. Since then, the empire has grown: alongside their Saint-Julien Classed Growth properties, there’s a Moulis estate (Mauvesin Barton) and a négoce operation. As if that wasn’t enough, Barton-Sartorius has two personal side-projects too: Initio and 225, the latter of which is his latest venture – a sustainability-led project, shipping wine in bulk and bottling in the destination market. He’s restless and enthusiastic, having taken over directing the Classed Growth estates (while his sister, Mélanie is in charge of Mauvesin) from his mother and Saint-Julien matriarch, Lillian Barton, in the last couple of years. This year sees the 200th anniversary of Langoa’s purchase – and when I ask him what has changed in that time, the answer is easy: “Not so much,” he shrugs. It’s the mark of a business like this, handed from generation to generation, that shifts are seamless and gradual, no one looking to make a mark – but preserve a unique heritage. Both Langoa and Léoville are classical Saint-Julien – a style often described as sitting between pinpoint Pauillac and sensual Margaux. For Barton-Sartorius, it’s “a bit like Vosne-Romanée in Burgundy, we have everything”. The Langoa estate is defined by its proximity to the river, the estuary’s constant movement helping to rid the vineyards of humidity and moderating the temperature – shielding it from extreme weather, rarely suffering from frosts (even in vintages like 2017) and allowing them to produce balanced wines in otherwise very warm vintages such as 2003, 2009 and 2018. It is, however, the soils that make Barton-Sartorius swoon. “The gravels are quite extraordinary,” he says, animated in his excitement. The gravels reach between three and six metres below the surface, giving the perfect level of drainage – but not too much, with a layer of clay beneath to hold essential water reserves. “The perfect balance,” Barton-Sartorius sighs. While it was once rare to hear the Bordelais talking about their terroir, there’s a definite shift underway. “For a long time Bordeaux was all about the brand – now they want to know what is behind the bottle,” he says. The shift, he feels, however, is not that the Bordelais are suddenly discovering their soils – but they’re talking about it. The region’s more monied estates have, however, been artful, managing to guarantee their place at the head of the fine wine table for over 150 years – and to do so, they’ve had to create stories. “There’s too much show – look at our new winery, our limited bottle....” Barton-Sartorius explains. Admittedly, he’s busily building a new cellar himself – although it is unlikely to be unveiled grandly with a row of new gleaming stainless steel tanks and the latest contraptions. Construction of the winery is already underway at Langoa (where both the Léoville and Langoa wines are made), set to be completed in 2022, the most recent update since his grandfather built it. Because of the sheer expense involved, they’ve only made tweaks over the years, but are now in a position to have been able to properly rethink it. The aim is for it to be more sustainable and functional, simplifying the process. Everything will be gravity operated, and the barrels will be stored two floors below ground so that less energy is required to keep them cool. Such concepts might seem standard elsewhere, however with Bordeaux’s high water table (remember that the Médoc was a swamp until the Dutch drained it in the 17th century), it’s difficult to build down rather than up. Winemaking at both Langoa and Léoville remains reassuringly traditional – “not by choice, but because it’s still the best”. There are exceptions, though, and where something is better done by machine, or it avoids a potential risk to workers’ health, they’ll do it – but there’s no compromising on quality to save a few cents. As just one example, they still rack everything by hand using a candle, because they feel it is a softer way to separate the wine from the lees, without exposing the wine to too much oxygen. “Details like this are very important,” Barton-Sartorius says. “But the wine is made in the vineyard.” He, like most vignerons, knows that it’s the quality of the fruit that matters most. “I like to think we’re good – but terroir is making 90% of the job,” he quips. The winery is, in his view, “more about a religion. You have to trust in something. You believe it or not.” It might be easy to be lulled into the sense that everything here is done by rote – simply following the recipe of their forebears, but that’s far from the case. “There’s a reason we do things the way we do – but we still like to challenge what we do,” Barton-Sartorius tells me, taking me through a ream of current and recent experiments, from pumps versus gravity (gravity won) to their decades’ worth of tests with organic vineyard sprays – looking not just at how they impact the cleanliness of fruit at harvest, but the wine’s final flavour. I ask him how he feels about Bordeaux’s status and relevancy today. “It feels like nobody knows it or people forgot about it,” he says. The region – in his view – remains one of the most exciting. He describes how the generation above are tired of people comparing the wines to how cheap they used to be – however is determined that they still offer great value. You can’t buy “Château Margaux as a lunch wine”, but Langoa Barton costs £30 – and “Napa is double, triple the price for the same quality”. And no one is able to hide their excitement when he gets an old bottle of Léoville Barton out the cellar. “We are lucky to have some of the best soils in the world – like Chambertin Grand Cru, the quality is the same – except instead of having two hectares, we have 80 hectares. We are lucky to produce 100,000 bottles of it.” That might make the wines, as he says, “a little less posh and fancy” – but it also means there’s more to go around. Is it a burden – a 200-year history and everything that comes with it? He instantly shakes his head, “It’s an honour – but a big pressure at the same time. I don’t want to be the generation that f***s up everything.” As Barton-Sartorius rushes off to meet the curfew in place under current Covid restrictions, it’s hard to reconcile his undeniable stature in Bordelais society with the down-to-earth character filling my screen. It’s that very lack of pomp and circumstance, an understated modesty, that will likely guarantee that Langoa Barton survives another 200 years. Keeping up with the Bartons

Mark Reynier is angry. After decades of shouting into the wind, his landmark Terroir Project – which scientifically proves the existence of terroir in whisky – has landed, and largely been derided or ignored by his peers.   “We have known this all along,” the founder and CEO of Waterford Distillery says. “There is a defence [in the industry] that terroir can’t exist in whisky because too many terrible things are done to the barley that negate it.”  Reynier is in the process of penning a “stinker” of a rebuttal to the latest dismissal of the academic study when we speak on a gloriously sunny, spring Islay morning. “It depends on whether you want terroir to exist or not,” he continues. “Of course it bloody doesn’t if you’re buying shiploads of [barley] in from the Ukraine. Who are you kidding? Open your eyes.  “But to deny it outright. To attack the message, attack the messenger, and destroy my reputation and everything. That’s why I have to do the Terroir Project, because I needed to be able to say: ‘You’re wrong, leave me alone.” When he joined the drinks industry in 1980, single malts represented 0.1% of sales and the national drink had become an industrial dog’s dinner, according to Reynier.    “I think everything went wrong, in my book, in the early ‘70s with the oil crisis, shutting down distilleries, recycling wood to cut costs and then adding [colour] at the last minute and chill filtering the whole thing to buggery,” he says.   He talks of an “age of innocence” before the ‘70s “when wood mattered, and barley actually tasted of something”. This halcyon period, coupled with his 20 years in the wine world, have influenced every decision he has made since. After 11 years polarising and challenging perceptions of age, peat-level, raw ingredient, and wood style at Bruichladdich, Reynier wanted to push the envelope even further with his next venture, Irish single malt distillery, Waterford.   “There is an enthusiasm in Ireland with the glass half-full as opposed to the Scottish half-empty,” Reynier says. “There is baggage in Scotland, even in Bruichladdich, with colleagues saying ‘ach no, you can’t be seen doing that. We’ll be laughed at.’” Absolute traceability is the goal at Waterford and this begins with the barley – looking back to that pre-1970s golden era, with varieties such as Hunter and Goldthorpe, trying to find flavours that have been bred out. Part of the Terroir Project has shown the two parent varieties from which all modern varieties are now propagated are too close together. “It’s like having a brother and sister as the source genetic material,” Reynier says. “For 50 years it has all come from the same bloody parents. And it wasn’t chosen on its flavour.” If confronting the Scotch and Irish whisk(e)y industry’s traditional wisdom wasn’t enough of a challenge, Reynier took up the mantle for rum in 2020 with the construction of the $20 million Renegade Distillery in Grenada. “I think rum’s problem is that nobody knows what real rum should be,” Reynier says. “Sixty countries make rum and it’s made from all sorts. There’s no uniformity, anything goes. So, everything does.  “For me, Renegade is a really simple question that we are seeking to answer and, no surprise, it is about terroir,” Reynier says. “It is about growing cane on different terroirs to produce different flavour compounds.”   In terms of other spirit categories Reynier has already got a remarkable gin to his name with Bruichladdich-produced Botanist. Most recently, he has toyed with the idea of agave, but fear of lawlessness and excruciatingly long harvests are battles he does not wish to tackle, yet.   “If a harvest of grapes fails one year or if a harvest of barley fails one year, then well fine, you’ve got the next year but with agave you haven’t. I think if I ever did anything it would be a Mezcal based on agave genetic modification to make it fruit more than once every 15 years and growing more of it. But that’s a bloody long-term project.” One suspects it won’t be long before that seemingly insurmountable challenge lures the tour de force that is Mark Reynier.  Browse all available Waterford whiskies and Renegade rums or read more Editorial

Barolo remains the most important region in the world for Nebbiolo. This variety is one of the world’s most sensitive and difficult to grow, rarely found outside Piedmont. While there are a handful of other high-quality enclaves across Piedmont including Valmaggiore (24km north of Barolo) and the cooler sites of Gattinara and Ghemme – collectively known as Alto Piedmont (or Alto Piemonte), nowhere else matches Barolo and neighbouring Barbaresco for complexity and ageing potential.  The wines are typically pale ruby in colour with grippy tannins, high acidity and a flavour profile of red cherry, mulberry, camphor and rose petal. The grape’s almost transparent character (similar to Pinot Noir) makes it a great transmitter of terroir – producing many nuanced styles, flavours and aromas – from the most delicate and floral to the most structured and mineral, and everywhere in between. It is this complex variety within such a small region that makes the grape, and the varying communes of Barolo, so interesting. Barolo has a cooler microclimate compared to nearby Barbaresco, resulting in a longer ripening season. While this means it is more sensitive to vintage variation, in the best years the wines reach highs unmatched anywhere else. Dry Barolo has been produced in the region since the mid-1800s. A wine that was a favourite amongst the aristocratic families of the Savoy dynasty, it is thought to have been first produced in this style by King Carlo Alberto’s estate in nearby Pollenzo. The aristocracy bankrolled wine production in Barolo, helping the pioneering winemakers at the time – such as Staglieno and the French oenologist Oudart – improve the quality and reputation of the wines. Their aristocratic link earned Barolo the nickname “the king of wines and the wine of kings”. Understanding the variety of styles of Barolo to a large extent depends upon where the grapes are grown. The landscape of Barolo is made up of many small undulating hillsides where exposition, topography and altitude all play important roles in the final character of a wine made in a specific part of the region or vineyard. Historically the sub-regions were not so important, largely due to the fact that Barolo wines existed exclusively as blends of fruit from across the region (often including grapes from the vineyards of Barbaresco). The 1961 vintage, however, represents a significant turning point when both Prunotto and Vietti released single-vineyard Barolos from Barolo Bussia and Rocche di Castiglione. While it was common knowledge amongst the local grape brokers which parts of the valley produced the best Nebbiolo, it wasn’t until the 1970s when these place names first came to print in Luigi Veronelli’s map. At the most basic level Barolo is divided into two valleys: the Central Valley and the Serralunga Valley. The Central Valley – including sub-regions of La Morra, Barolo and Novello – produce a more approachable style, noted for their fragrance and elegance, thought to be due to the distinct blue-grey marl content in the Tortonian soils found in these vineyards. The Serralunga Valley – with its sub-regions of Serralunga d’Alba and Monforte d’Alba – tend to create more powerful, tannic, concentrated wines due to the higher content of clay, limestone and sandstone found in the Serravalian soils. In Castiglione Falletto there is a richer concentration of sandstone and this is generally thought to produce a middle ground between the more structured character of the Serravalian soils and the elegance brought about by the Tortonian soils.  While these variations in soil throughout the sub-regions play some part in the differences in the structure and flavour profile of different Barolos, this is just one factor and should be understood as broad generalisations. The complex terroirs are defined not just by the soils, but by the varying expositions, altitudes, viticutural techniques, clones, pruning and winemaking methods which vary from estate to estate – making it impossible to provide a completely definitive profile of each area.    
A guide to Barolo's communes  There are 11 village communes within the Barolo DOCG: La Morra, Barolo, Castiglione Falletto, Serralunga d’Alba, Cherasco, Diano d’Alba, Grinzane Cavour, Monforte d’Alba, Novello, Roddi and Verduno. Below you’ll find a guide to the distinctive style of the main communes, as well as the best growers from each.  La Morra Wines from La Morra can be some of the most perfumed Barolo, typically with soft, smooth tannins. It is believed that the fine sandy soil of the region is behind the wines’ elegance. As the largest Barolo subregion, however, La Morra is the most diverse both in style and quality. Typically, these wines can be much more approachable in youth and tend to fair better in cooler vintages. Top producers in the region include Roberto Voerzio – who makes a unique style for the region, with strict pruning leading to miniscule yields and austere, tannic wines with long ageing potential. Poderi Oddero is more typical for the commune, producing bright, fruity Barolos with distinctly elegant tannins. Elio Altare is known for more modern-style Barolos which are matured both in traditional large barrels, as well as smaller barriques, and some new oak for their single-vineyard wines. Top vineyards: Brunate, Cerequio, Rocche dell’Annunziata Barolo Similar to La Morra, the Barolo sub-region produces broad, open, velvety Barolo but often with a bit more structure and concentration than those from La Morra. The region is home to some of the most historic sites, including Cannubi – a Cru that was singled out as an exceptional site even before the creation of the Barolo appellation (with the earliest bottled example of this site dating back to 1752). It is also home to some of the most respected producers in the region, who make markedly different styles of Barolo – further confirming that location is only part of the puzzle. Fierce traditionalists Bartolo Mascarello famously don’t make single-vineyard wines but their blended Barolo remains one of the region’s finest. Guiseppe Rinaldi’s winery is also staunchly traditional in their winemaking, seeing cross-commune blends as the ultimate expression of Barolo. winery is also staunchly traditional both in their winemaking, and blending of vineyards, seeing cross-commune blends as the ultimate expression of Barolo. Luciano Sandrone is more modern in style, the wines made in an elegant style that is more approachable in youth but also offers fantastic ageing potential – making them some of the region’s most collectable. Top vineyards: Cannubi, Ravera, Bricco delle Viole Castiglione Falletto  Although situated in the Serralunga valley, Castiglione Falletto falls somewhere in the middle between the elegant and fragrant qualities of La Morra and Barolo, and the boldness and concentration of Serralunga and Monforte. This is due to the aspect of the best slopes here, where the vines have maximum exposure to the sun, meaning riper fruit and added concentration. Giuseppe Mascarello produces one of Barolo’s most famous single-vineyard wines from the Monprivato Cru. Traditional in style, the wine is fermented in tank and aged in large oak. Vietti – a true pioneer of single-Cru Barolos – is also based here, as it has been since the 1800s. This estate has not only some of the best label designs in the world, but access to some of the finest Crus in Barolo, including Ravera, Rocche di Castiglione and Brunate. Top vineyards: Rocche di Castiglione, Fiasco, Villero Serralunga d’Alba  Serralunga is defined by its high concentration of Sant’Agata soils. Growers here talk about the vines feeling pain, as the harder soils put more stress on the vine, producing wines of great depth and power – as well as some of the highest tannin levels and the most full-bodied Barolos of any region. The wines can often have a distinctive bitter orange aroma. The wines are solid and typically austere, but can also be incredibly elegant and expressive, some of the most terroir-driven and long-lasting Barolo. By far the most famous and revered wine from Serralunga is Giacomo Conterno’s Monfortino. Monfortino was in fact the first ever producer-named Barolo made in the Riserva style, with the first vintage made in the 1920s (today it comes from the Cascina Francia Cru). Although based in Barbaresco, Bruno Giacosa produces two of Barolo’s most revered wines from the Serralunga Cru of Falletto, released only in top vintages. These are two of the most consistent expressions of top single-vineyard Nebbiolo in Barolo. Top vineyards: Cascina Francia, Falletto, Ornato Monforte d’Alba Defined by concentration and structure, the soils in Monforte d’Alba contain more clay than limestone – the opposite of Serralunga. The resulting wines tend to have more volume on the palate and boldness, making them the most concentrated Barolos. The wines exhibit classic rose petal, clay pot, clove, camphor and cardamom aromas, and particularly bold tannins. Look out for bottlings from Elio Grasso whose Case Matè Barolo comes from Ginestra. Bussia is one of the most famous, but also largest Crus, producing many different styles. The best part of the vineyard is Upper Bussia; a natural amphitheatre with varying expositions, when combined it produces wines of fantastic complexity. The Grand Cru wines of Alsace and in particular the wines of Zind-Humbrecht are some of the most transparent and detailed aromatic whites out there. The wines from the single-vineyard sites in particular have all the breeding to be some the most complex white wines in the world. The wines are barrel-fermented in the old traditional oak foudres using only natural yeasts, typically taking a staggering 12 to 15 months to ferment.  As a comparison, most white wine takes just two to three weeks to ferment. The reason for the long ferments is to do with the high acidity levels in the wines, pushing them right through malolactic fermentation, and Olivier’s insistence on only using natural yeasts during fermentation. He wants to ferment his wines to dryness and with grapes such as Riesling and Pinot Gris from Alsace, this means a long wait. The wines are then aged on their lees and bottled, unfined and filtered, directly from the original cask 18 months after harvest.  Tasting the single-vineyard sites from Zind-Humbrecht provides a fascinating exploration of site, variety and vintage that is rarely laid so bare. The wines have as much intensity and intrigue as Grand Cru Burgundy, yet they are distinctly Alsatian in style, with their power, warmth and spicy mineral complexity defining its sense of place. Another distinct element to the Alsace region is that within the same vineyard each of the four permitted Grand Cru varieties - whether it be Riesling, Pinot Gris, Gewürztraminer or Muscat – are free to flaunt their individuality within the same site, providing different interpretations of the dominant terroir through the characteristics of each variety.   

Two of the most complementary and contrasting single-vineyard sites within Zind-Humbrecht’s portfolio are the limestone-rich Clos Windsbuhl vineyard in the Hunawihr region in Central Alsace and the volcanic Clos-Saint-Urbain vineyard located in the most southerly part of Alsace, within the Grand Cru of Rangen de Thann – the most iconic and historic vineyard of the region.

Clos Windsbuhl overlooks the church of Sainte Hune. A monopole site (owned entirely by Zind-Humbrecht), it isn’t actually a Grand Cru, although many believe it should be. It sits directly above the Grand Cru of Rosacker – the source of Alsace’s most cult wine Clos Sainte Hune. It has a distinct soil type, rich in limestone with clay and chalk on the lower part. It is one of the last vineyards to ripen in Alsace due to its high altitude (350 metres above sea-level). It is this cooling influence and slow ripening that creates the aromatic complexity typical of this vineyard. Nestled close to the Vosges mountains, it is protected from the winds but as one of the coolest sites in Alsace, Clos Windsbuhl performs best in a warm vintage such as 2018.   Tasting the latest wines from 2018, the pulsing drive in all three wines – Riesling, Pinot Gris and Gewürztraminer – is obvious, no doubt the limestone soils providing this distinct tension and focus. Despite the pulsing drive, the wines remained controlled and very elegant. Olivier believes it is this finesse and elegance that is the defining characteristic of Clos Windsbuhl.  2018 Riesling Clos Windsbuhl The Riesling has a strong limestone presence, taut structure and pulse. It’s so linear, but with contained fruit – honeyed pink apple and white peach. In some ways it shares strong similarities with white Burgundy. 
2018 Pinot Gris Clos Windsbuhl The Pinot Gris has a slightly oilier texture, and an additional lushness. Despite this, the limestone still plays a very strong role in this wine – poised, taut acidity pulses through the wine. It does not have the aromatic camouflage of Riesling, the chalky minerality is even more. Very powerful and elegant – forward drive seems very characterful of Clos Windsbuhl. 
2018 Gewürztraminer Clos Windsbuhl 
The Gewürztraminer has a beautifully focused rather than flamboyant nose of lychee and white flowers. Noticeable residual sugar gives the wine a lovely creamy textural quality, yet the energy and poise so typical of the vineyard is still very present, giving the wine lovely balancing mineral freshness. Olivier states that this Gewürztraminer has the same tannin levels as a red Burgundy!  Clos-Saint-Urbain: volcanic sandstone Clos-Saint-Urbain sits within the Grand Cru of Rangen de Thann and is Alsace’s most southerly vineyard with a unique composition of highly mineralised volcanic soil (unlike any other site in Alsace). With its south-facing steep vineyards, the vines get incredible sun exposure, and the dark reddish-brown soil heats up like a furnace.  All these elements help the grapes reach high levels of phenolic ripeness, while the altitude of 350 to 450 metres means the vines are some of the most late-ripening, with the harvest often taking place two to three weeks after the start of the harvesting period in Alsace. The altitude and poor soils also protect the acidity in the wine, together producing some of the longest-lived white wines ever made. Decanter’s Andrew Jefford describes the Rangen vineyard as producing "the ultimate terroir wine", and it has even been nicknamed by many as "the Montrachet of Alsace".

Like Clos Windsbuhl, Clos-Saint-Urbain has similar intensity and strong mineral presence, though the mineral profile is really very different. It is much flintier and smokier, almost a touch of peat-smoke. All the three varieties are much more savoury on the palate. Whereas the fruit is more present and pristine in the Clos Windsbuhl, in the Clos-Saint-Urbain, the fruit is more caramelised and plays second fiddle to the volcanic minerality. 
 Riesling 2018 Clos-Saint-Urbain This is expressive on the nose, dominated by flint, chalk stone and caramelised lemon. The tension is remarkable. With the high mineral content comes real intensity and power too. Quince, lemon sherbet and a strong salinity creates an expansive mouth-watering finish. This is epic.  2018 Pinot Gris Clos-Saint-Urbain This rich, full-bodied, opulent Pinot Gris has heat-fuelled flint and smoke characters. The wine has a very creamy mid-palate, a silky and supple texture with gorgeous apricot and nectarine flavours interspersed with the saline-tinged smoky minerality. Tension builds on the back palate, this is bold, rich Pinot Gris, but with plenty of focus and a mouthwatering finish. 2018 Gewürztraminer Clos-Saint-Urbain The Gewürztraminer has a wonderful smoky, peat-like nose with plenty of ginger spice, classic lychee aromas and flinty minerality. Again, there is a silky texture to the wine and a light, herby, saline bitterness to the finish. It’s very long, with a fiery, spicy finish. Explore Alsace or read more Editorial
