This year sees the release of the 20th vintage of Cheval des Andes – Cheval Blanc’s operation in Mendoza. Since the team from the legendary Saint-Emilion estate embarked on the venture with Terrazas de los Andes, 25 years ago, much has changed – and this is the start of a new era for the property. What was once a working concept has taken root.  “This is the beginning of our adult life,” says Technical Director Pierre-Olivier Clouet. “We have a real identity today.” It’s taken a quarter-century for the property to shake off the uncertainty of youth and find firm footing – something that hasn’t necessarily been easy.  “We made mistakes,” Clouet confesses. Not having a historic reputation to rely on, the team at Cheval des Andes had sought out high scores, chasing points to prove their worth. But, in a still Parker-dominant era, that meant making wines with “ripe grapes, a lot of extraction, a high level of alcohol – you [had] to show the muscle to explain that you are a great wine”, explains Clouet. “For a long time, the recipe was in the cellar; nobody cared where the vines were.” Now, however, that’s all changed.  From 2011, the team started shifting focus to the vineyard, working more closely with their French counterparts and vice-versa. The arrival of Lorenzo Pasquini (now the man at the helm of Ch. d’Yquem) in 2015 was key to the transition, as Cheval des Andes started to focus on a shared vision of fine wine – one that is about freshness, balance and ageing potential, and one that defines Cheval Blanc.  Only with a few wrong turns, however, can you be sure you’re on the right path – and Clouet is clear that those first 16 years, figuring out what Cheval des Andes should and could be, has been “super important” in helping them build “something with real sincerity, real authenticity”. Most importantly, Cheval des Andes is not intended to be, nor is a copy of Cheval Blanc: “It is, in our mind, absolutely an Argentine wine,” says Clouet.  The original 31-hectare vineyard is in Las Compuertas in Luján de Cuyo, a subregion of Mendoza. It is on these clay-dominant soils at around 1,000 metres’ altitude that Pierre Lurton discovered a plot of ungrafted Malbec in 1998. Planted in 1929, the vine material pre-dates phylloxera, descended from a selection imported to Argentina in 1852 – back when the grape dominated Bordeaux. This selection is key to the DNA of Cheval des Andes and, along with the huge diurnal shift, produces Malbec that is fresh, precise, perfumed and delicately structured. For Clouet, the “true” Malbec is closer to Pinot Noir in style – more floral than fruit-led, vibrant and even ethereal.  In 2001, the team purchased an additional parcel in La Consulta in the Uco Valley, at higher altitude and with more gravel-driven soils, a cooler site that has an even more significant diurnal swing in temperature. While they once might have used only a fraction of the estate to produce the flagship wine, they have moved to using as much as they can – to create a pure expression of the entire property, declassifying only plots that don’t fit in the blend or meet their stringent quality standards.  All 50 hectares are farmed with the same philosophy as their vines in Saint-Emilion – employing extensive cover crops, trees scattered throughout the vineyard, and with the same incredible attention to detail and focus on sustainability. “We work with the same vision and the same conviction,” says Clouet. One key difference, of course, is that irrigation is essential in this part of Argentina – but, here again, they’ve changed tack over the last decade or so. Rather than traditional modern drip irrigation where necessary water would be eked out drop by drop over the season as needed (“too artificial”, Clouet tells me), they irrigate extensively over the winter to ensure the soils are replenished fully between seasons (as well as help protect ungrafted vines against phylloxera), then – on a plot by plot basis – when the vines are starting to suffer, they give the vines around 40mm of water (still via drip irrigation), over 24-48 hours, replicating a day or two of steady rainfall.  They’ve reduced the height of the canopy (the engine of the vine for sugar production), while using trees, cover crops and minimal leaf-pulling to avoid sunburn. They’ve started pruning each vine according to its vigour, and are now picking significantly earlier – as much as two months earlier than 15 years ago. With this detail in the vineyard, the challenge is simply to guide the fruit through the winery: “No mistakes is enough in the cellar,” says Clouet.  In some ways, the wine echoes Cheval Blanc. While the Saint-Emilion property blends Cabernet Franc and Merlot, Cheval des Andes focuses on Malbec and Cabernet Sauvignon – the Malbec bringing freshness and silkiness that complements the backbone of powerful Cabernet. And the Cheval Blanc style, one of restraint and precision, shines through in recent vintages of the wine – and especially the soon-to-be-released 2021. As Clouet tells me, “Our vision is absolutely delicacy, freshness, balance, ageing potential, complexity.” Unlike Cheval Blanc, however, which needs 10 years in bottle to start even hinting at its potential, Cheval des Andes offers an immediacy – something that Clouet is clear doesn’t inhibit its ability to last; the 2021, for example, can be drunk now, but will evolve over the next 25 years at least, he tells me.  Even the association with the Cheval Blanc name doesn’t make Cheval des Andes an easy sell to fine wine lovers; but that, says Clouet, is part of what makes it fun – a challenge for the team to be pushed. Even better, his team gets the chance to learn and make wine not just once a year, but twice, as well as gaining additional insight on how Cheval Blanc might adapt to climate change. But Cheval des Andes isn’t just an intellectual exercise (that is merely an added bonus), Clouet firmly believes in the potential of this site – something they’re now finally beginning to realise. Ch. Cheval Blanc is one of the finest producers in Bordeaux. The Saint-Emilion estate’s Cabernet Franc-dominant blends are consistently among the top wines of any vintage and under the tenure of Pierre-Olivier Clouet, the wines are only getting better. Listening to how Clouet talks about the property, the experiments, the confidence to talk about mistakes as much as successes, goes a long way in understanding why. This is someone who eats, drinks and sleeps Cheval Blanc – obsessively looking to better the wine. Cheval Blanc’s other Saint-Emilion property, Ch. Quinault l’Enclos has become an important test bed for developments at Cheval Blanc, and means the estate has seen a huge amount of investment over the last few years. Clouet accepts it is a “simpler” terroir compared to its sibling, but that challenge has pushed the team to explore the effects of terroir and varieties at a micro level. Since taking over the estate in 2008, Clouet felt that Quinault l’Enclos struggled to reach the standards he expected. Between 2009 and 2011, he admits their results were so-so. By 2012 they felt they had captured more freshness and balance in the wine, but they still didn’t have the density they felt the terroir was capable of producing.  Clouet knows they can’t simply make another Cheval Blanc at Quinault l’Enclos. Cabernet Franc, for instance (the backbone of Cheval Blanc), is a “fussy grape”, says Clouet, and just doesn’t work on the sandy/gravel terroir at Quinault. “The terroir also doesn’t have the clay soils that can help polish the mid-palate, and the tannins can become too rustic if we extract too much,” he explains. It is a fine balancing act and, while Merlot dominates in this terroir, they are finding success planting more Cabernet Sauvignon. Tasting the 2018 Quinault l’Enclos, the wine has the restrained touch synonymous with Cheval Blanc – something that is even more notable given the hot vintage. The fruit is firmly in the purple and blue spectrum and lovely violet, floral aromatic notes add complexity. The tannins are compact and impressively refined, and Clouet is clearly happy that in their 10th vintage at the estate, they have found the elegance and mid-palate density they have long been searching for. Alongside Quinault and the Grand Vin at Cheval Blanc, there is also the estate’s little-seen second wine, Le Petit Cheval. Clouet is keen to emphasise that Le Petit Cheval is purely a second wine: “It is made simply to make Cheval Blanc better.” It is the vintage that dictates how much Petit Cheval is made. In 2015 and 2022, for example, there was no Petit Cheval as the quality was so consistent it all went in the Grand Vin. Typically, Le Petit Cheval represents just 10% of the estate’s production, while 15% is typically sold off in bulk – mainly press wine, none of which is ever used in the Grand Vin. The Grand Vin, therefore, typically represents around 75% of production. In 2020 the blend for Petit Cheval was, unusually, 59% Cabernet Franc. It was a challenging vintage for the variety and less therefore went into the Grand Vin. For Clouet, 2020 was not as good as 2018 or 2019, and the growing season was not as conducive to good Cabernet Franc. Despite Clouet’s criticism of the vintage (“over maturity on the nose and underripe on the palate”), the 2020 Petit Cheval is a great wine. Notable power combines with big tannins and just a tiny hint of rusticity, but it has the refined touch of Cheval, a lovely, earthy, savoury quality and a long finish. Located in northwest Saint-Emilion, on the border with Pomerol, Ch. Cheval Blanc neighbours a number of high-profile estates, including Ch. Figeac to the south, and Pétrus and Vieux Château Certan in Pomerol. Its position between Pomerol and Saint-Emilion (while not on its limestone plateau) makes it a unique site in the appellation. Of the estate’s 39 hectares there is also tremendous variation in terroir. It is divided into 53 plots across 10 different soil types – clay, sand and gravel in varying proportions. For Clouet, it is this diversity that defines it. Many of the key components of the winemaking process have not changed since 1832, insists Clouet, however technology has allowed the team to increase the precision and purity of each bottle. “It’s the same picture, but with more pixels; we’re simply increasing the resolution of the wine,” Clouet explains. These days there is meticulous care and attention to detail at every stage of production, from the vineyard to picking each plot when the grapes are precisely “al dente”, right through to bottling.  Tasting through benchmark vintages underlines the success of this fine-tuning and the underlying style of the property. The 2018 is one of the great wines of the estate. Even in its infancy, the wine has incredible depth and a breath-taking density of tannins that are already seamlessly integrated – quickly followed by a surge of energy and an overriding freshness on the finish that gets the blood pulsing. Clouet describes Cheval Blanc as being shy at first, accelerating on the mid-palate – and that certainly comes through in the 2018, with a lovely lift on the finish. There is so much detail to the fruit with plenty of rich, concentrated black and red fruit flavours along with liquorice and menthol notes from the Cabernet Franc. The purity is outstanding and is hard to fault. Now with eight years in bottle, the 2015 is starting to reveal its quality, with the first hint of development beginning to show with lightly medicinal notes, beautifully delicately smoked oak tones and lifted floral violet aromas. The tannins again are seamless, yet dense. There is an unctuosity and fatness to the 2015 on the mid-palate, yet it is so fresh for the vintage. This is juicy and rich but with graphite mineral notes too. The density and detail is extraordinary. And the signature rush of energy and overriding freshness on the long finish is there. Although the 2012 Cheval Blanc doesn’t have the power or the intensity of the 2015, it is no less arresting. It is full of energy and has developed fresh tobacco notes and leather tones. The mid-palate remains really juicy, rich and pure. The tannins are again totally integrated with a mineral, minty note on the finish that has the Cheval Blanc lift. Finally, the 2009 – a wine that has legendary status among collectors: it is an incredible wine to taste, but noticeably different to the 2012, 2015 and 2018. The oak treatment and extraction is different and quite clear when tasted side by side. There is a touch more chalkiness to the tannins – not as seamless as the modern vintages – and they are more drying on the finish. Clouet notes that they certainly extracted more back then and the oak tannins are also more present, as is the toasting of the oak which has also been reduced in recent years. The power, freshness and energy is classic Cheval Blanc, but the refinement of the modern vintages shows that even at this level of quality there is room for improvement. There are few vignerons with such a meticulous approach to winemaking as Pierre-Olivier Clouet, whose fearless experimentation with one of Bordeaux’s most iconic wines has taken Cheval Blanc to new heights. It is only by tasting the wines side by side that you can really experience how this wine has developed over the last 15 years or so. It is a trend that mirrors much of what is happening in Bordeaux, with less extraction and more subtle oak, but few vignerons have discovered their magic recipe quite so astutely as Clouet at Cheval Blanc. We caught up with the dynamic winemaker about how to define the undefinable – and why it’s determined to lead the appellation into a new era Saint-Emilion has always been difficult to define. Unlike other top terroirs of Bordeaux – Margaux with its silky tannins and aromatic flair, Pauillac with its graphite minerality and structure, and Pomerol’s opulent, rich palate – the profile of Saint-Emilion has never been so easy to identify. Beyond that, the wines can be frustratingly inconsistent in quality too, making it Bordeaux’s most idiosyncratic appellation. Beyond the variation in quality and flavour profile, a political splintering of the appellation in the last few months, resulting in three of the four Premier Grand Cru Classé A wineries (Cheval Blanc, Ausone and Angélus) withdrawing from the classification has brought further turmoil to this seemingly troubled appellation. “Perhaps,” Ch. Cheval Blanc’s Technical Director Pierre-Olivier Clouet begins, “the many idiosyncrasies of Saint-Emilion are easier to understand, when you realise it is the largest appellation in France, consisting of over 800 growers on nearly 6,000 hectares of vineyards.” Put in context, the second largest commune in France, Châteauneuf-du-Pape, is almost half that area at 3,300 hectares. Given its large area, Saint-Emilion doesn’t have the same homogeneity of soil as Bordeaux’s other appellations and it is this, Clouet believes, that goes some way in accounting for the region’s variety. While many of the top estates are situated on the limestone plateau, on the outskirts of the historic town itself, the appellation’s borders stretch way beyond this most prevalent feature and cannot be accurately defined by limestone alone. This is no more evident than with Cheval Blanc – arguably the most atypical estate in Saint-Emilion. “If the DNA of Saint-Emilion is Merlot grown on limestone, it is bizarre that Cheval Blanc is in the appellation at all,” Clouet chuckles. “We grow Cabernet Franc on clay!” Cheval Blanc sits at the appellation’s limits, four kilometres away from the limestone plateau, bordering Pomerol. But Cheval Blanc is not such an easy fit with Pomerol either. “We should have a monopole appellation,” jokes Clouet. His point is serious, however, Cheval Blanc straddles both the Right Bank’s top terroirs, yet is not typical of either. It certainly makes Cheval Blanc more difficult to explain, admits Clouet, compared to the other great estates of Bordeaux that can be defined by their parity of variety and terroir. “Pétrus is Merlot on clay soils. Lafleur is Cabernet Franc on gravel. Ausone is Cabernet Franc on limestone. Latour is Cabernet Sauvignon on clay. But Cheval Blanc is impossible to know like that, because of its range of soils,” Clouet explains. For Clouet, this multi-faceted personality gives Cheval Blanc great flexibility and is a key reason for the estate’s success and consistency. “We think we are very lucky because we can play on the two parts of the Right Bank,” he says. “Every time it’s a vintage for Merlot, we blend for Merlot. When climatic conditions are better for clay, we play with clay, so we can play with the identity of the vintage.” Cheval Blanc has 53 plots on 10 different soil types – clay, sand, gravel in varying proportions – and grows Cabernet Franc, Cabernet Sauvignon and Merlot. For Clouet, the DNA of Cheval Blanc is its diversity. “We are an orchestra, not a soloist. We need all our musicians to play the music.” Perhaps then, Cheval Blanc’s wide-ranging terroir makes it a fitting mascot for the heterogeneous nature of the Saint-Emilion appellation. Despite Cheval Blanc’s recent withdrawal from the classification system, Clouet is keen to emphasise that the Saint-Emilion appellation is important, and something they should continue to defend and invest time and money in. The wines of Saint-Emilion are all linked by the place – and this is much more important than variety or blend, which he feels other regions have wrongly placed emphasis on. “Each bottle of wine should tell the story of that place,” says Clouet. However varied Cheval Blanc’s terroir may be, it’s undeniable that the wine captures a distinct sense of this place. Indeed, beyond a small increase in its holdings in 2012 encapsulating a neighbouring vineyard, it is one of the few châteaux in Bordeaux whose perimeters have barely changed in 150 years. For Clouet, however, the appellation is about more than terroir, there is a “dynamic spirit” at the heart of Saint-Emilion. While not so easy to define, Clouet believes it is an appellation that has greater flexibility than others. It is often cited as the most Burgundian of the Bordeaux communes, due to the high number of small estates and the sheer number of vignerons, something which makes it a “dynamic place” in Clouet’s eyes. “It never stops thinking how to change,” he says. This, he believes, provides some great advantages. “Smaller estates have the capacity to move quickly. This is arguably the most vigneron-led place in Bordeaux.” Such dynamism in the past has certainly seen Saint-Emilion leading trends in the region, both good and bad – depending on your point of view. The garagiste movement in the early 2000s, for examples, is a fashion that continues to divide the region. But Clouet believes Saint-Emilion is an appellation ahead of its Bordeaux counterparts, leading in sustainability and the trend towards freshness and delicacy, and terroir-driven wines. That said, there’s no “recipe”, he says. “Each and every château has to find its own balance.” But, he warns: “We need to be careful and not go too far one way or the other. A new recipe is to pick too early, another is to use too little oak.” He quotes Coco Chanel, “fashion changes, style endures” – each producer should find their own identity, their own style and stay true to it. It’s essential to be opened minded, he says – but to never copy others, follow a recipe or chase trends. The current move in Saint-Emilion to plant more Cabernet Franc is a perfect example, for Clouet, where fashion is being followed foolishly. “Cabernet Franc today is probably the most trendy variety in the world. I don’t know any winemaker who doesn’t talk to us about Cabernet Franc. It seems to be the solution to global warming, but I think it is completely the opposite,” he says. For Clouet, Cabernet Franc has no capacity to adapt: in the right soil it produces top wine, but in average soil the results are terrible. The hot 2020 vintage, for Clouet, proves his point – with producers favouring Merlot over Cabernet Franc, even when the latter dominates their vineyards, pointing to Lafleur and Ausone, as well as Cheval Blanc. The warm, dry conditions didn’t favour the modish variety – and an overreliance on Cabernet Franc planted in the wrong place could prove disastrous in the face of climate change. For the already atypical estate, Cheval Blanc is looking instead at further diversifying. While Cabernet Franc is key to its identity, the estate has shifted from once having Merlot on gravel and Cabernet Franc on clay to have “everything, everywhere”. “We want to multiply the diversity,” Clouet explains. Diversification is at the heart of everything Cheval Blanc stands for today, laid out in their recently published manifesto – a clear statement of intent that unless Bordeaux moves away from monocultural farming, its future is at risk. “In the last 10 years agriculture was a problem,” says Clouet, “but I think agriculture could be the solution.” He gives carbon dioxide as an example: while there’s too much in the atmosphere, trees, vines and cover crops can be used to capture it. Clouet believes the manifesto is not just a piece of paper or marketing pamphlet, but a roadmap to show how a more sustainable approach is possible. “The biggest problem in the 20th century for agriculture was not just pesticides but monoculture.” While Cheval Blanc will continue to only earn money with their wines, admits Clouet, other crops and livestock will be used to provide “resilience, a capacity to decrease disease and problems in the vineyard”. Clouet goes on to explain how 50 years ago, trees were removed from vineyards to make it easier for tractors, but prior to this vines, trees and other plants co-existed. “Organic production is not enough today,” says Clouet, who does not want to simply return to the past. “We want to take the best of modernity.” Cheval Blanc is not organic because it believes that copper, permitted and widely used in organic viticulture to fight mildew, is more harmful than a synthetic alternative. “It’s common sense,” says Clouet. “When you use organic methods to tackle mildew you have to spray every week – it is nonsense. We try to think sensibly. The solution will be through science and research. We shouldn’t go just with philosophy. We need to be agronomic and practical to find a solution.” If the spirit of Saint-Emilion is about dynamic change, then it is fitting that the appellation’s most recognised estate is leading the charge to revolutionise the region’s approach to viticulture and safeguard its future. For Cheval Blanc, agriculture is at a crossroads. “Viticulture is at the mercy of climate change and the drastic reduction in biodiversity,” states Cheval Blanc in its manifesto. Over the last few years Cheval Blanc has been transforming its vineyards into permacultures – interplanting trees, plants, other fruits and vegetables, as well as introducing animal grazing, flower farming and beekeeping to the vineyard in an attempt to ensure soil fertility, promote diversity and capture carbon. Reading about the latest political spat over the current Grand Cru Classé system, the endless court cases and corruption charges, you would be forgiven for thinking that the spirit of Saint-Emilion is imploding. But it is the spirit of Saint-Emilion, according to Clouet, that unites this somewhat idiosyncratic appellation. Beyond the classification chaos lies a heterogenous band of vignerons, united by their diversity and dynamic approach. With the release of its manifesto, could Cheval Blanc unite the troubled appellation, with growers working together towards a fully sustainable, future-proof Bordeaux? Cheval Blanc certainly hopes so.

In a report published in 2014 by the UN’s Food and Agriculture Organisation, under current rates of degradation, all the world’s topsoil could disappear within 60 years. With 95% of all food produced relying on these living soils, this pronouncement was a stark and terrifying warning of what lies ahead. Industrial farming and deforestation are the leading causes behind the degradation of soil. Grape growing and large parts of the wine industry remain very much part of that problem. France’s vineyards, as an example, are the country’s biggest consumers of chemical fungicides, insecticides and herbicides. These products can devastate the life in the soil and completely disrupt the biodiversity of a region. Although viticulture represents just 3% of France’s agricultural land, the sector spreads 20% of the country’s fungicides. Many vignerons have tried to reduce chemical inputs, either using them as a last resort or not at all. Some believe non-chemical additions of copper and sulphur typically used to treat fungal diseases (the biggest threat to yields) are more damaging to the environment than systemic chemical interventions. It is a complex picture. But there are vignerons committed to non-chemical approaches – growers who believe they can offer alternative methods that are both sustainable for the future and remain commercially viable. While there are various approaches, they all share the belief that protecting the health of the soil is fundamental to their vineyard’s long-term future, as well producing a farming system that is not only sustainable but regenerative, in that it sequesters more carbon dioxide in the soil than it takes out. Exactly how this is practised remains a contentious debate. Many of these growers are certified organic, many are not – certification itself is another controversial issue. Biodynamic farming is organic farming with a more holistic approach, trying to recreate a natural balancing ecosystem that allows nature to restore and rejuvenate itself, in rhythm with the lunar cycle. Others have gone even further and have allowed their vineyards to grow wild, believing that an undisturbed vineyard is the most sustainable and ecologically healthy. Organic and biodynamic farming practices are essentially a return to conventional farming methods carried out prior to the introduction of chemical farming 70 years ago. The more non-interventionist approach goes one step further, attempting to recreate an environment that pre-dates all commercial farming. It is an approach in which crops and other plant life coexist together, allowing the environment to dictate what grows where. Under the teachings of Masanobu Fukuoka, it was coined “natural farming”. Masanobu Fukuoka was a Japanese microbiologist and agricultural scientist who studied plant pathology. After nearly dying during a bout of pneumonia, he experienced what he described as a profound spiritual experience – leading him to begin to doubt modern agricultural science. He gave up his scientific post and returned to his family’s farm on the southern Japanese island of Shikoku. It was here that he developed his own non-intervention farming techniques, which involved no tilling or ploughing, and no fertilisation of the land. This was to protect the vital microorganic life in the soil, that he believed was essential to creating an ecologically balanced environment. The publication of his seminal book, The One-Straw Revolution, in 1975, went on to influence the permaculture movement (no till, no ploughing) in the west, and even more radical concepts. Alsace-based viticulturist Bruno Schloegel (of Domaine Lissner) is one such radical. He has a nine-hectare estate that, over the last 20 years, he has adapted to what he calls the “savage” approach to viticulture. For him, “savage” is a more accurate translation of Fukuoka’s methods. “I asked my Japanese friends to translate Fukuoka’s Japanese term,” says Schloegel, “and it translates as something between being free and alive. But not just the vines, the whole system of animals, insects, fungus. The key is not to disturb, as this will weaken the system.” For Schloegel it is a better translation than “natural” which today, he believes, no longer means anything. Despite adopting Fukuoka’s ideas, Schloegel was in fact practising the same approach before he was even aware of the Japanese farmer’s book. “I never knew about Fukuoka until a few years ago. I was given his book and it was amazing. Almost every page, we were totally linked.” Both former scientists, Schloegel too became frustrated by the scientific data available. “It is more complex than the techniques we have been taught,” he says. “Even when I was a student, I thought this. I am a scientist as he was. I studied in the ’70s. He studied in the ’60s. But our conclusions are the same. The answer is to not disturb.” Prior to Fukuoka, Schloegel was taken by the work of the eminent English scientist Dennis Noble, a pioneer of systems biology whose publication The Music of Life became a huge influence. Noble uses the analogy of life as many orchestras playing different scales, very small and very big. “Molecules, atoms, landscape, living beings as well as the vine – all are playing together and that is what we call life. We can listen to each scale of this living system, and you will find almost the same music, because it is totally coherent. Each scale is in harmony. It was very inspiring to me,” Schloegel explains. Like Fukuoka, Schloegel has a strong respect for spirituality as well as science and talks about how the human brain deciphers experiences differently. He uses music as an example, describing how listening to music creates an emotional reaction which the scientific part of your brain can’t explain. “Knowing you only have a small knowledge of this complexity, this complexity of nature, makes you humble. But spiritually you get pleasure from living with this complexity and not trying to control it. It’s just like a wave you are surfing on. This is the pleasure side.” As well as adopting a no-plough, no-till approach, unlike biodynamic farming, Schloegel does not sow seeds for cover crops, nor use any organic fertiliser, preparations or other inputs. He believes his vines’ roots not only root deeper, but are more resistant to disease and suffer less from stress. He also saves on the costs of such additions. So what does he do? He prunes the vines each year – very late in March/April just prior to the new buds forming – and he mows between the rows just prior to harvest. He does also use copper and sulphur, when necessary, to tackle disease but believes he can phase this out. Beyond that, the vineyard is left to its own devices. It is hard to keep up with Schloegel sometimes – his concepts are unconventional, but this holistic approach is highly considered. It is completely at odds with the commercial farming approaches and understandably has caused controversy. But he, along with a growing number of viticulturists around the world, is totally committed to the concept that permaculture is essential to the future long-term health of arable land. He believes he can not only produce an economically viable crop (up to 40hl/ha), but he can produce wines with greater complexity and terroir expression. He believes it takes between seven to 12 years of not disturbing the vineyards for them to find their balance. “At this point you are on the crest of the wave – it is very calm,” he says. But this is a long process and requires a lot of faith to commit to. Even Schloegel admits it gets worse before it gets better, as the vineyard adapts. “When you stop the herbicides, the mowing and the ploughing, you get the bad weeds. But these weeds prepare the soil for the next generation of plants,” he says. Poppies, lilies, thistles, wild orchids then start to appear and then fruit and vegetables and a huge variety of plant life and wild flowers begin to grow. His vineyards today have a huge variety of plant and wildlife species coexisting, with cherry, apricot, fig, almond trees and wild vegetables, flowers, fruits, and aromatic herbs all growing between the vines. What then happens seems incredible. Schloegel explains, once in equilibrium you see distinct plants continue to grow in the same place each year, depending on the terroir of that part of the vineyard. There is one part of his vineyard where 30 metres of wild strawberries appear every year, growing alongside the vines. In other parts there are leeks, other parts a particular herb. Schloegel outlines that even within a single vineyard, very little is exactly the same. The composition, altitude, slope, geological make-up are all different and, when left to adapt, one vineyard grows multitudes of plant species at different levels of concentration in different parts of the vineyard, depending on what adapts best to that particular spot. This is what Schloegel believes is real terroir in action: “A terroir is a full, complex living system – and a wine of this terroir is a response. In this totally free, rich, complex place. I know it is possible for natural systems to rebuild from themselves. But it cannot be fostered.” Fukuoka’s farm on the island of Shikoku in southern Japan was a rice and citrus fruit farm and, while he managed to produce commercial yields of both rice and fruits, the transference of his techniques to the vineyard is not quite as straightforward. The concepts are radical and while a few like Schloegel are convinced it’s possible – with his own yields varying from 10-40hl/ha, others remain sceptical. Schloegel’s Alsatian neighbour Olivier Humbrecht MW (of Domaine Zind-Humbrecht) does not believe a non-interventionist approach is a good idea – nor that it is necessary for making wine a sustainable crop for the future. While Humbrecht accepts there may be many good ideas in terms of regenerative methods that heighten biodiversity and increase the health of the soils, he is sceptical of its long-term future. Humbrecht’s fundamental criticism is that Schloegel’s approach is not as undisturbed as he claims.“A vine is a cultivated plant,” says Humbrecht. “You are cultivating something, disrupting something natural and making it not natural. It is not natural to plant vines one metre apart on a slope, in poor rocky soil, in a place where it doesn’t rain much. It’s not natural to force it to produce grapes every year. So you have to compensate this with something.” For him, permanent cover leads to soil compaction – with the shallow roots of these plants and the topsoil damaged when working in the vineyard – which has graver long-term effects than tilling or ploughing. These stresses on the vine, Humbrecht explains, are exactly why we have flavour in our wines. Each of these stresses, whether it be the nutrient stress from poor soils, the water stress from growing on a slope or well-drained soils, or nutrient stress from high density planting – these are all deliberate decisions made by vignerons who, over the last 2,000 years, have discovered the best places to cultivate and stress the plant in order to produce delicious fruit. This fruit is the vine’s attempt to escape, through tempting wildlife to eat it and disperse their seeds somewhere less inhospitable. “France would be a forest if untouched and I’m not sure you would not find one wild vine where we have the top vineyards today,” he says. Humbrecht remembers discovering the vines on his own Grand Cru vineyard Rangen de Thann. These vines had been abandoned since World War One. When he arrived 60 years later, most of them had disappeared. The vines that did survive and adapted were producing tiny, small clusters of grapes. Humbrecht believes non-intervention farming would have similar results. “If you don’t prune a vine for 10 years you will end of with tiny clusters, producing maybe 2-4hl/ha – a typical commercial yield in the region is closer to 80hl/ha. Humbrecht’s biggest concern centres around this approach’s commercial viability. And that is important if these methods are to be adopted more globally. If these vineyards’ crops are too small, the vineyard will fail and more likely be bought up by someone else who could return the vineyard to conventional, chemical farming. While there may be disagreements between Humbrecht’s biodynamic approach and Schloegel’s “savage” approach, the permaculture concept has led others to adapt their practices. Michel Chapoutier has been farming biodynamically for the last 30 years but has more recently adopted permaculture. “How I am managing my soil today is completely the opposite to how I managed them biodynamically 20 years ago,” he tells me. Chapoutier now believes the disturbance of the soil is more damaging than the removal of weeds and therefore has stopped ploughing his vineyards. For Humbrecht, light ploughing and resowing cover crops is a better solution. “There is no technique that is 100% good,” he explains. “You have to weigh up the options. What is better? Let the vine die from the competition of the plants growing in May, or disrupting the microorganisms in the soil by ploughing four inches into the soil (between May and June) – you have to choose. It is always a question of balance.” Another producer who has gone beyond organics and placed the development of biodiversity and regenerative practices at the heart of their operation is Gaja. The early success of Piedmont as a fine wine region in Italy saw areas such as Barbaresco and Barolo become dominated by vineyards. Forests were felled and biodiversity dropped. Gaja has since incorporated more trees, adopted permaculture methods in the vineyard and today produce their own organic fertiliser in their historic vineyards. The team has also recently purchased new land in Alta-Langhe where they are not just planting vines, but trees too, incorporating the trees and the vines together. “There is a growing sensibility towards the importance of biodiversity,” says Gaia Gaja, “therefore we are fine with sacrificing space suited for vineyards in favour of trees, we believe in the long run this decision will benefit the health of the vineyards.” Industrial farming is in ecological and financial crisis. More sustainable approaches have to be adopted if we are to survive the next generation, but, so far, those choices come at a cost. For many farmers struggling to make a living, the conventional, chemical farming approach has become the only way to financially survive, taking each year as it comes. These growers can ill afford to think much beyond that, despite the system’s long-term unsustainability. Many feel trapped and find more sustainable approaches economically unviable without better directed government subsidies that promote regenerative farming practices. Wine is hardly an essential food product, but it is the economic engine for entire communities that rely on it for subsistence. In certain wine regions where there is a reliance on water reserves and chemical inputs, it will have to adapt or die. Minimal intervention viticulture is no doubt a radical option, but truly regenerative viticultural approaches will be necessary in a future where food shortages become more widespread. Chapoutier and Zind-Humbrecht, even Schloegel, albeit blessed with great terroir, are paving the way, proving it is possible to produce wine at good volume, at all price points, with a regenerative approach. A return to the wild: beyond organics

When visiting the cellars of Domaine Hubert Lamy, you are likely to come out a lot wiser than you were when you went in. Olivier Lamy has been experimenting ever since he joined his father at the domaine in 1995, and he loves to share his findings.  On our last visit we were given two white wines blind and asked to assess them. One thing seemed immediately clear: with its deeper colour and more developed savoury tones, one wine was older than the other. “No” he replied. “They are the same age.” Okay, perhaps the reason for such variation in development is due to the wines coming from two different quality sites – a Grand Cru versus a village wine for instance? “No, it is the same vineyard,” he replied. Perplexed, the only other solution I thought must be his high-density plantings. (Olivier has planted parts of his vineyard three times the density of the norm in Burgundy, with up to 30,000 vines per hectare), the result being smaller, more flavourful berries. Wrong again.   “Wrong experiment,” he smirks, leaving us completely stumped. He presents the two bottles and the answer lies with the capsules. Both wines have the same cork closure but one has the traditional metal capsule seal, the other bottle has been dipped in wax. It is the wax capsule that seems not only younger and fresher, but more texturally complex, yet both the wines are from exactly the same vineyard, with the same vine density and vintage. It is simply the closure that has preserved one wine so much better.   Olivier has been experimenting with closures for years. There have long been concerns about natural cork, with the risk of cork taint top of the list of potential problems, but it was the issue of premature oxidation, particularly with white Burgundy, that led Olivier to investigate whether maybe the problem lay with the closure.  Despite the drop in natural cork’s popularity and their replacement with alternative, “technical” corks and screwcaps, the natural cork still has plenty of advocates, and it remains the most sustainable and natural of solutions for many. A better understanding of the causes of cork taint has vastly improved the natural cork’s reliability and reputation, yet “being a natural product there remain irregularities in the cork,” says Olivier. Natural cork is irregular in structure, therefore allowing different levels of oxygen ingress, meaning that the same wine can mature differently depending on the specific cork, and resulting in bottle variation.  Olivier also believes the irregularities of cork have become worse in recent years due to climate change, with the warmer temperatures resulting in even less consistent cork.  The benefit of the wax capsule, according to Lamy, is that it acts like a “bandage”, offsetting the irregularities of the cork. His grandfather and many other winemakers often used wax capsules for wines destined for their personal cellars; it was the reliable ageing capacity of these wines that prompted his experiments. Trialling the effects of waxed and unwaxed capsules since 2009, he decided to use wax capsules on all his wines in 2016. Over this time, he has experimented with varying diameters and lengths of cork, different treatments, as well as testing plastic, agglomerate, and technical corks before concluding that longer (54mm), technical DIAMs (a natural cork-based agglomerate closure), under wax seal produce the best results and best protect against premature oxidation.  Does this mean we have a definitive answer to the question that has plagued white Burgundy for the last couple of decades regarding premature oxidation? While his experiments certainly seem to imply that the irregularity of natural corks could be one of the biggest culprits and wax capsules one of the most successful solutions, he does not believe it is only the cork which is at fault. “There are two problems,” he says. “Poor-quality corks and the fact that wines are more fragile these days.”  The increased fragility of white Burgundy, Lamy believes, is a modern phenomenon. Climate change produces riper grapes, combine this with too many new barrels, modern presses that are too protective and you have wines that are more susceptible to oxidation. All too aware of this concern, many vignerons, Lamy believes, attempt to overprotect their wines, adding too much anti-oxidative sulphur dioxide (SO2) throughout the winemaking process. Counter-intuitively, this in fact makes the wines more susceptible to oxidation. When wine is made in a more protective environment, the more volatile phenolics remain in the wine, whereas these will drop out of a wine  when it is made oxidatively at the early stages of vinification, resulting in a much more stable wine.   Despite vignerons’ better understanding of the effects protective winemaking has on long-term ageing, these techniques are still used by many because it makes the wines so much more approachable in their youth. Many white wines today are built on developing these youthful aromas at the expense of ageing potential, Lamy argues. This is, he says, is in direct contrast with the past, where wines were built on texture, remaining fairly closed in their youth, with the aromas only developing with age.  There are still many traditional vignerons in Burgundy producing textural white wines built to age – with Lamy (who does not enjoy young, aromatic Burgundy) being one of them. With the warming climate, he has, however, had to adapt his winemaking to protect these more fragile wines. These days he manages the press cycle according to the vintage and allows for more solids when required.  With all the wines now bottled under DIAM and wax capsules, all Lamy can do now is wait. But, if his experiments are anything to go by, the risks of premature oxidation are low. Of course, he’s not sitting back – the dynamic winemaker is looking to experiment even more, pushing the boundaries to produce the best, and most age-worthy, wine possible.

The Grand Cru wines of Alsace and in particular the wines of Zind-Humbrecht are some of the most transparent and detailed aromatic whites out there. The wines from the single-vineyard sites in particular have all the breeding to be some the most complex white wines in the world. The wines are barrel-fermented in the old traditional oak foudres using only natural yeasts, typically taking a staggering 12 to 15 months to ferment.  As a comparison, most white wine takes just two to three weeks to ferment. The reason for the long ferments is to do with the high acidity levels in the wines, pushing them right through malolactic fermentation, and Olivier’s insistence on only using natural yeasts during fermentation. He wants to ferment his wines to dryness and with grapes such as Riesling and Pinot Gris from Alsace, this means a long wait. The wines are then aged on their lees and bottled, unfined and filtered, directly from the original cask 18 months after harvest.  Tasting the single-vineyard sites from Zind-Humbrecht provides a fascinating exploration of site, variety and vintage that is rarely laid so bare. The wines have as much intensity and intrigue as Grand Cru Burgundy, yet they are distinctly Alsatian in style, with their power, warmth and spicy mineral complexity defining its sense of place. Another distinct element to the Alsace region is that within the same vineyard each of the four permitted Grand Cru varieties - whether it be Riesling, Pinot Gris, Gewürztraminer or Muscat – are free to flaunt their individuality within the same site, providing different interpretations of the dominant terroir through the characteristics of each variety.   

Two of the most complementary and contrasting single-vineyard sites within Zind-Humbrecht’s portfolio are the limestone-rich Clos Windsbuhl vineyard in the Hunawihr region in Central Alsace and the volcanic Clos-Saint-Urbain vineyard located in the most southerly part of Alsace, within the Grand Cru of Rangen de Thann – the most iconic and historic vineyard of the region. 
Clos Windsbuhl: limestone 
Clos Windsbuhl overlooks the church of Sainte Hune. A monopole site (owned entirely by Zind-Humbrecht), it isn’t actually a Grand Cru, although many believe it should be. It sits directly above the Grand Cru of Rosacker – the source of Alsace’s most cult wine Clos Sainte Hune. It has a distinct soil type, rich in limestone with clay and chalk on the lower part. It is one of the last vineyards to ripen in Alsace due to its high altitude (350 metres above sea-level). It is this cooling influence and slow ripening that creates the aromatic complexity typical of this vineyard. Nestled close to the Vosges mountains, it is protected from the winds but as one of the coolest sites in Alsace, Clos Windsbuhl performs best in a warm vintage such as 2018.   Tasting the latest wines from 2018, the pulsing drive in all three wines – Riesling, Pinot Gris and Gewürztraminer – is obvious, no doubt the limestone soils providing this distinct tension and focus. Despite the pulsing drive, the wines remained controlled and very elegant. Olivier believes it is this finesse and elegance that is the defining characteristic of Clos Windsbuhl.  2018 Riesling Clos Windsbuhl The Riesling has a strong limestone presence, taut structure and pulse. It’s so linear, but with contained fruit – honeyed pink apple and white peach. In some ways it shares strong similarities with white Burgundy. 
2018 Pinot Gris Clos Windsbuhl The Pinot Gris has a slightly oilier texture, and an additional lushness. Despite this, the limestone still plays a very strong role in this wine – poised, taut acidity pulses through the wine. It does not have the aromatic camouflage of Riesling, the chalky minerality is even more. Very powerful and elegant – forward drive seems very characterful of Clos Windsbuhl. 
2018 Gewürztraminer Clos Windsbuhl 
The Gewürztraminer has a beautifully focused rather than flamboyant nose of lychee and white flowers. Noticeable residual sugar gives the wine a lovely creamy textural quality, yet the energy and poise so typical of the vineyard is still very present, giving the wine lovely balancing mineral freshness. Olivier states that this Gewürztraminer has the same tannin levels as a red Burgundy!  Clos-Saint-Urbain: volcanic sandstone Clos-Saint-Urbain sits within the Grand Cru of Rangen de Thann and is Alsace’s most southerly vineyard with a unique composition of highly mineralised volcanic soil (unlike any other site in Alsace). With its south-facing steep vineyards, the vines get incredible sun exposure, and the dark reddish-brown soil heats up like a furnace.  All these elements help the grapes reach high levels of phenolic ripeness, while the altitude of 350 to 450 metres means the vines are some of the most late-ripening, with the harvest often taking place two to three weeks after the start of the harvesting period in Alsace. The altitude and poor soils also protect the acidity in the wine, together producing some of the longest-lived white wines ever made. Decanter’s Andrew Jefford describes the Rangen vineyard as producing "the ultimate terroir wine", and it has even been nicknamed by many as "the Montrachet of Alsace".

Like Clos Windsbuhl, Clos-Saint-Urbain has similar intensity and strong mineral presence, though the mineral profile is really very different. It is much flintier and smokier, almost a touch of peat-smoke. All the three varieties are much more savoury on the palate. Whereas the fruit is more present and pristine in the Clos Windsbuhl, in the Clos-Saint-Urbain, the fruit is more caramelised and plays second fiddle to the volcanic minerality. 
 Riesling 2018 Clos-Saint-Urbain This is expressive on the nose, dominated by flint, chalk stone and caramelised lemon. The tension is remarkable. With the high mineral content comes real intensity and power too. Quince, lemon sherbet and a strong salinity creates an expansive mouth-watering finish. This is epic.  2018 Pinot Gris Clos-Saint-Urbain This rich, full-bodied, opulent Pinot Gris has heat-fuelled flint and smoke characters. The wine has a very creamy mid-palate, a silky and supple texture with gorgeous apricot and nectarine flavours interspersed with the saline-tinged smoky minerality. Tension builds on the back palate, this is bold, rich Pinot Gris, but with plenty of focus and a mouthwatering finish. 2018 Gewürztraminer Clos-Saint-Urbain The Gewürztraminer has a wonderful smoky, peat-like nose with plenty of ginger spice, classic lychee aromas and flinty minerality. Again, there is a silky texture to the wine and a light, herby, saline bitterness to the finish. It’s very long, with a fiery, spicy finish. Explore Alsace or read more Editorial

Exploring Alsace’s terroir: Clos Windsbuhl versus Clos-Saint-Urbain

The growing season in 2019, as is becoming the norm these days, started with a warm February and March, leading to an early budbreak at the beginning of April. An early budbreak leads to a nail-biting spring for the vignerons, where the window for frost damage is only extended. Fortunately, there were only a couple of occasions where temperatures dropped to dangerous levels, with most Chablis producers today well equipped either with smudge pots, electrical heating wires or water sprays to offset the frost damage.  At Long-Depaquit they lost just 5%, which was not a concern. Samuel Billaud notes that the frost was much more dangerous on the lower slopes of Chablis where damage was higher than the 1er Cru and Grand Cru sites which were largely undamaged. For Olivier Bailly, winemaker at Domaine Billaud Simon, it was not simply the direct damage of the frosts (particularly on the night of 14th April) but the resultant stress on the vine following the outbreak that saw yields further affected. However, the real issue in regard to yields, came down to flowering rather than frost, with a windy, rainy, wet period during May which meant yields were notably affected. This period led to a lot of heterogeneity in the bunches and also noticeable millerandage (which results in very small berries): this does not affect quality but markedly lowers yield. Unlike 2018, therefore, 2019 is a low-crop vintage with producers’ yields ranging from 20 to 40% below normal. Despite the poor flowering, the rest of the growing season was straightforward, with very little rain and plenty of sunshine, which meant excellent sanitary conditions in the vineyard with no rot at all and very little sorting required at picking. There were two short heatwaves, one at the end of June and another at the end of July, which did cause sunburn damage to exposed grapes but other than that, no sorting was required. Regarding temperatures and rainfall, it was similar to 2018 with average rainfalls down 50% on average. Temperatures were also a full 2.2 degrees above average during the growing season, which is quite extraordinary. When comparing the similar effects of drought and sunshine in the 2018 vintage, vignerons talked about how the high yields helped dilute the intensity of the sun. With half the crop, how did the grapes survive in 2019? Was this to be a low-acid vintage with abnormal tropical fruit tones like 2015 or 2003? Matthieu Mangenot, winemaker at Domaine Long-Depaquit, describes how something quite unusual happened. In the later part of the growing season, the grapes concentrated – with water in the berries evaporating from the skins. This increased sugar levels and therefore alcohol (typically to 13.4 to 13.8%, which is high for Chablis, but it concentrated the acid levels too. Despite the drought and heat, the acid levels sit close to great vintages such as 2008, 2014 and 2018, with a pH of 3.25 to 3.3 after malolactic fermentation. Olivier Bailly at Domaine Billaud Simon had even higher acidity levels (between 3.10 - 3.25 pH), stating, “It is the magic of Chablis to find Chardonnay retaining such acidity, despite the warm weather”.  The result is, as Mangenot told us, “undoubtedly a ripe, concentrated, powerful vintage, but with a freshness too, at the same time retaining real Chablis mineral typicity. It is a hot, warm vintage but it does not really behave like that in the glass.” The fruit ripeness is similar to ’15 – but there are no excess aromatics of over-ripeness or yellowness in the wine that is typical of the low-acid vintages like ’05 and ’06. The acid profile is much more like ’17, and very much still retaining a sense of place, avoiding the tropical fruit aromas of 2015. Samuel Billaud describes 2019 as “highly concentrated Chablis with sun-kissed aromatics – it is concentrated, with balanced structure and excellent minerality. It is a ‘gourmand’ [moreish] vintage, yet with tense, structural minerality.”  Our own impressions is there is no doubt a concentration and aromatic pungency to the wines, yet the nose retains the Chablis-esque chalky minerality and savoury dried-straw tone, as well as lifted floral aromatics. There is noticeable power, weight and warmth to the palate even on the Premiers Crus, with the top examples retaining mouth-watering acidity despite this opulence and concentration. They really have a wonderful combination of intensity and power, while retaining mineral typicity. Producers such as Samuel Billaud still has a majority of his 2019s undergoing élevage, with the Grands Crus left another six months in tank before being bottled. Despite them being babies the wines are already showing a lot of promise. Billaud compares his 2019s to the 2016s in terms of riper aromatics, but with much more concentration and minerality. It also has similarities to the 2017 vintage when it comes to structure and minerality, he says.  For Mangenot, the power and concentration allied with vibrant acidity and minerality makes this vintage hard to compare, “It doesn’t really taste like any other,” he says, “but for Chablis-lovers, it makes it a fascinating vintage to discover.” Read more Editorial

Chablis 2019: a first look at the vintage

Olivier Humbrecht was in London earlier this year giving a masterclass on single-vineyard Pinot Gris from Alsace. His motivation and his love for dry Pinot Gris evolves around the varietal being the greatest transmitter of terroir, much more so than its more famous sibling Riesling whose natural aromatics can conceal its terroir blueprint. Of course that was just the starting point of the masterclass and it quickly evolved into a much more in-depth conversation on the virtues of singular plots and the underpinning concepts of fine wine. We caught up with him to get further insight into his pioneering approach in viticulture which is being adopted by some of the finest wine producers in the world. The changing fortunes of Pinot Gris Humbrecht is a strong believer in the potential of Pinot Gris, a varietal that has ebbed and flowed in popularity through the last century. It is a varietal that due to its rather neutral primary attributes means it is perhaps more than any other grape, at the throes of its maker.  Styles vary greatly from the high-yielding neutral, phenolic, early picked and refreshing Pinot Grigio synonymous with northern Italy. At its worst, the variety produces a wine of almost no character and no sense of place. At its best, the dry, vibrant Pinot Grigio from Alto Adige can be fantastically intense, mineral and refreshing, whilst remaining fairly neutral on the palate. Pinot Grigio Romato styles in Friuli (a skin contact rose style) offer more flavor definition and
richness whilst at the same time being distinctly phenolic with vibrant acidity and a bitter bite keeping the wine refreshing and uniquely Italian in character.  The Pinot Gris of Alsace is typically later picked and completely different to the Italian style in its flavor profile, taking on a distinct honeysuckle, musk, smoky, toasty quality. Even within Alsace, this varietal has many faces. In the 1960s Olivier reminds us that Pinot Gris from Alsace was the most popular and most expensive wine in the region, but also the rarest and typically very sweet, as it is prone to noble rot resulting in intensely rich, opulent wines. In 1990 just 2% of the vineyards in Alsace were planted with Pinot Gris, today it is up to 15%. But Pinot Gris is not an easy grape to get right and whilst the early picked, neutral style of Northern Italy can crop at high levels with little issue, to make Pinot Gris with more aromatic character is much more difficult to get right and therefore becomes a much less reliable crop and accounts for the small amounts grown in Alsace. It is a varietal very prone to rot due to its thin skin. In ideal conditions, this makes it ideal for noble rot but in less than perfect conditions grey rot is more common making the grapes not suitable for fine wine. The rot will often result in aborted fermentation.  The varietal is also very quick to ripen. If not picked in a very small picking window, the alcohols could shoot up too high making a healthy fermentation very difficult and, more often than not, leading to high levels of residual sugar in the wine, whether you want it or not. Olivier outlines that just taking a weekend off during harvest could amount to a potential 1.5% abv increase when returning to the vines on Monday morning. In under a week, the potential alcohol could have gone up by 3% abv.  Picking the wines too early also has its problems. All the flavor and aromas in the varietal develop at the final stages of ripening, picking early will produce wines with little complexity and character. This tricky little grape is no doubt the reason why so little was planted in the region despite the popularity of the top Pinot Gris sweet wines. The recent increase in plantings in Alsace however has not been brilliantly successful. For Olivier too much Pinot Gris has been planted in inadequate sites and using higher yielding commercial clones. For Olivier, top Pinot Gris from Alsace must come from the traditional petit grains clone that is naturally low-yielding. Olivier likes each vine to produce just 2 clusters producing just 25-30 hectolitres per hectare. These cropping levels are necessary to produce fine wine examples from the grape. Olivier’s interest in Pinot Gris is down to its relatively neutral character making it a great transmitter of terroir, more so than Riesling whose natural aromatic presence can conceal terroir characters. Fairly neutral flavour characters also mean it remains very much a winemaker’s wine, as the vigneron can determine the style of the wine with lees work, oak maturation, and the retention of malolactic fermentation, providing the grapes come in clean, free of rot. Olivier believes élevage on full lees makes a very important difference to the flavor of the wine. The lees nourish the wine through ageing, producing a much more complex
flavour profile. It brings a smokiness and toasty character to the wine as well as a more reductive “mineral” character. Global warming It is rare to hear a vigneron say that global warming has improved the quality of their
wines, but Olivier honestly states that, for the moment, global warming has benefited his wines. What it has done is bring flowering forward, possibly up to three weeks earlier which shunts all the growing season forward, this means the all-important veraison period (sugar concentration in the grapes) is beginning to happen three weeks earlier.  Rather than waiting for grapes to ripen in September as the days are getting shorter and the weather much less reliable, veraison is now happening at the height of the summer enabling the wines to reach optimum ripeness quicker preventing the onset of rot – which in poorer weather becomes a lot more common.  Biodynamic since 1998, Olivier has seen a really positive effect in the vineyard. The grapes are able to ripen faster, reaching physiological ripeness quicker, which enables Olivier to make dry Pinot Gris packed with flavor. This, he believes, is because chemical applications shock the vines, causing them to shut down for a number of days following the application. If you continue to spray chemical applications throughout the growing season, each time this happens the vine shuts down and you lose valuable days of ripening.  Under biodynamic principles, the vines don’t go through these shock / shutting-down
phases. This allows Olivier to pick earlier and he is the first to harvest the Pinot Gris compared to his neighbours. This he believes is largely due to his grapes ripening faster, due to his viticultural techniques.  It means he can get his wines to reach aromatic complexity whilst still being able to bring them in early enough free of rot and therefore enabling a fermentation to dryness. The reason for Olivier's interest in producing dry styles of Pinot Gris is so he can show off the terroir characteristics of each of his sites without being concealed by sweetness. Tasting the different vineyards shows just how different each of the sites is and only further promotes Pinot Gris as the ultimate transmitter of terroir. A pioneer of modern-day viticulture Speaking with top viticulturalists all over the world, you realise a huge amount of their knowledge stems from Olivier Humbrecht, whose understanding of managing vine growth originated from a university lecture he attended in the 1980s, given not by a viticulturist, but a plant physiologist.  From this lecture, Olivier understood that modern-day hedging techniques in the vineyard were really detrimental to fruit production. Olivier explains the domesticated vine goes through two very different stages in its growth period. Stage one is the phase of cellular multiplication i.e. the growth of the vine – flowering, budding, leaf production etc. Stage two is the nourishment phase in which the vine stops growing and instead starts to nourish the pips in the grapes, to promote future cellular growth when the seeds are dispersed.  The problem with modern hedging techniques is that it disturbs stage one when the vine is
on the verge of moving to stage two, therefore encouraging the vine to carry out stage one and two at the same time, meaning the grape isn’t getting full nourishment at the period of veraison as some of the vine’s energy is going into vine growth. The key for Olivier is to get stage two to follow on from stage one rather than the vines trying to do both at the same time. Preventing canopy growth, however, requires a lot more manual work. Olivier states it
requires 20 men to tie up the vines manually compared to one tractor hedging the vines. One possible solution could be to hedge the vines earlier in the growth phase so as not to disrupt the vine later in the season switching from stage 1 to stage 2 but Olivier explains this is not a good approach. Tartaric acid is key to any white wine, and it is the necessary backbone to any wine.  Tartaric acid is produced by the leaves. Olivier emphasizes that many people wrongly
think leaves only create sugar through photosynthesis, but they are necessary for producing a whole array of essential nutrients, hormones and the all-important production of tartaric acid. The secret lies in extended canopy growth. I said to Olivier this sounds exactly what Lalou
Bize Leroy does in Burgundy and he admits that he visited her years ago and told her his ideas on canopy management and she clearly took his advice. Whilst it is incredibly high maintenance and an expensive operation, two of the world’s leading winemakers Humbrecht and Leroy are advocates of the system and that should be enough for any vigneron to at least consider the technique, despite the additional costs it entails.  The single vineyards Rotenburg The Rotenburg vineyard is a cooler north-facing slope facing the Vogues mountains. Made up of red marl on a limestone bedrock with very shallow brick colour soil (containing high iron content). All this amounts to slower ripening, naturally lower vigour and tiny yields. Olivier typically crops at 25 hectolitres per hectare. Olivier states what is great about this vineyard when made in the dry style, the effect of the limestone really comes through on the palate. Tasting through the 2017, ’16 and ’13 the wines share a wonderful aromatic complexity.
Easily the most floral and perfumed of the three vineyards. There is a wonderful chalky minerality to the wine, almost top quality Chablis but with a softer texture and more perfumed. With age, the aromas and flavours only further develop whilst retaining a wonderful intensity. The wine remains very clean despite its age, showing very little tertiary
development just lovely orange rind and honeysuckle notes. The chalky limestone
minerality brings sharp focus and intensity to the finish. Clos Windsbuhl The first vintage for Zind Humbrecht on this site was the 1988 vintage. Another limestone/
clay site overlooking the church of Sainte Hune (famous for the Trimbach’s Clos Sainte Hune cuvee). Facing south, south-east with a steep slope between 15 – 40% this is a high altitude site at 350 metres. A 6.5 hectares site planted mostly to Pinot Gris. Due to the
altitude and soil the grapes ripens very slowly, often on the precipice of reaching ripeness before the wine gets affected by noble rot.  Tasting through the ’17, ’16 and ’13 what is immediate in the comparison is how the wine
develops with age. At just three years of age, the wine remains compact, at seven years of age it is incredibly complex on the palate. The primary notes have retained their zesty vivacity but the flavours become broad from russet apple, manuka honey and sultanas and a wonderful salinity and stony minerality on the finish. The wine becomes more and more focused on the finish. Clearly, the wine is affected by vintage too. The ’16 is a more difficult vintage making the wine a lot less intense than the ’17 and the ’13 but throughout the lineup, the salinity and stony minerality comes through on the palate – a distinct characteristic
of the limestone soil. Rangen de Thann Unlike Rotenburg and Clos Windsbuhl, Rangen de Thann is made up of volcanic soil, very
dark basalt rock, rich in magnesium and potassium and low in calcium so lower acidity, higher pH. The slope is the steepest in Alsace with a 41-degree slope. The vineyard has an incredibly high vine density at 10,000 vines per hectare. It is in fact one of the warmer regions of Alsace therefore you would expect it to be one of the first to ripen, but the cold wind that flows through the valley slows the ripening making it the last vineyard Oliver harvests. This is typically the lowest-yielding site at Zind Humbrecht at 20 – 30 hectolitres per hectare. The volcanic soil offers a completely different blueprint to the wine. Texturally the wine is much more oily and rich. The flavours are more pumice stone, peppery, matcha tea and then this distinct Brazil nut flavor. There are no tropical notes at all in its youth and very much more savoury in style. With age the ’13 vintage shows more tropical notes, the texture becomes unctuous in its oiliness, it feels like there is sweetness despite being a dry wine. These wines lack the vibrancy from the limestone but offer more richness, texture and darker fruit and savoury flavour profile. Explore more Editorial
