It’s four centuries since the Giraud-Hémart family first began farming vines in Aÿ, writing the first chapters of an extraordinary legacy.   Although they started out as tenant farmers, the Church granted them a swathe of land in the 17th century – with François Hémart the first member of the family to be registered in the parish records. The modern history of the family, however, starts in the 20th century, when a soldier by the name of Léon Giraud was garrisoned in Aÿ and fell in love with Madeleine Hémart. The couple soon married and had a son, Henri Giraud, moving into the property that the family still lives in today.  At the time, vineyards across the region had been abandoned in the wake of phylloxera and Léon set about replanting three hectares of vines. For 300 years the family had been growing grapes and selling the fruit, but after Henri returned from the Second World War, he and his father decided to start making their own wine – establishing the Giraud-Hémart label. The business grew and evolved, especially after Claude Giraud (Henri’s second son) arrived in 1972, aged just 20. Working with his father over the 1970s and ’80s they rejigged the vineyard holdings and acquired additional holdings to make up the 10 hectares they own today, as well as changing the property’s name to Champagne Henri Giraud.   In 1990, they started buying in additional fruit to meet demand and made their first vintage of Fût de Chêne – the wine that became Argonne from the 2002 vintage. Although in the 1990s the family was ageing wine in oak, it is only in the 21st century that they started working exclusively with oak from the Argonne forest – now integral to the House’s identity.  The Argonne forest was historically the source for much of the wood used in Champagne, home to over 150 coopers, but was gradually abandoned, suffering from particular damage during the Second World War. Henri Giraud has made it a mission to restore and protect the forest, working with the French National Forest Office (ONF) on a replanting program (and have planted over 60,000 trees to date). The House feels Argonne oak is a key part of their terroir – indeed their top wine takes its name from the forest. The poor, dry soils of the forest mean oak trees grow particularly slowly, resulting in a particularly tight grain, creating a delicately flavoured wood to complement the delicate wines of Aÿ.  Today, the business remains a tightly knit family affair – with the 13th generation running the show. Emmanuelle Giraud is at the helm of the House, having taken over from her father Claude, who while not officially part of the business remains present and involved in key decisions. Emmanuelle’s sister Anne le Golvet-Giraud was drawn to therapeutic practices, launching the property’s trademark Craÿotherapy – chalk-based wellness program offered at their in-house hotel (they were one of the region’s first producers to welcome visitors for tastings and now to stay). It is Anne’s husband, Sébastien le Golvet, who is in charge of the winemaking.  “It’s very important to always be curious, to seek something better from the wine, from the grapes,” Giraud tells us. No one embodies this philosophy at Giraud more than Le Golvet, a force who, since he arrived in 2002, has pushed to experiment and innovate both in the vineyards and winery. Over the last two decades, he’s introduced residue-testing on their soils to confirm their triple-zero approach (zero pesticide, insecticide or fungal control spraying – something they feel is more impactful than organic certification and have long pioneered), banished stainless steel from the winery (using only terracotta and wood) and toasts every barrel the House uses himself. Constantly looking for new ways to elevate the wines further, he has recently created and started using custom barrels with sandstone heads. As Emmanuelle tells us, his philosophy is firmly that, “The best wine will be the next one.”  Henri Giraud manages to balance being at the cutting edge with the patience that traditional-method sparkling wine requires. As Emmanuelle explains, they have to make sure everything is perfect from the moment the grapes are harvested – for any mistakes will be discovered in a decade’s time. While she’s concerned with broader strategy and planning for the business, when it comes to harvest-time, you’ll find her on the winery floor, managing fruit receival, each and every year, seeing the culmination of the year’s work.  Being independent and family-owned allows them the luxury of a truly long-term vision. Each vintage they make trials, the results of which will only be revealed in 10 years’ time, but they’re investing far beyond that – planting 12,000 trees in the Argonne forest each year, making sure that Henri Giraud will still be able to use this special oak in two centuries’ time. The House’s extraordinary wines reflect this vision, testament to their relentless pursuit of quality and remarkable attention to detail. Domaine des Comtes Lafon’s Montrachet is remarkable. The estate’s rare, famous flagship wine comes from a tiny plot – just 31.82 ares, less than a third of a hectare–at the southernmost point of the world’s most famous white wine vineyard, with Blanchot Dessus across the road, and right next door to plots belonging to Domaine de la Romanée-Conti. In fact, the plot is so tiny that in the low-yielding 2016 vintage, the property joined forces with DRC, Leflaive, Domaine Guy Amiot & Fils, Domaine Lamy-Pillot and Domaine Fleurot, pooling together their grapes to produce two barrels of Montrachet from their combined 1.25 hectares.   The Lafon family has owned their plot since 1918, however the vines were farmed by the Morey family for a long time. Indeed it was only in 1991 that Dominique Lafon officially reclaimed it. The vines here are very old, with the vast majority planted in 1953, and a small section planted in 1972.  These old vines bask in the sunshine, facing south, their roots on deep limestone soils that preserve minerality and freshness. The wine produced is remarkable. Tasting through a vertical back to 2001 at our recent dinner, the style really shone through: it is one of the richest and most powerful Montrachets, possessing both great concentration, yet also an amazing freshness that carries it through a long drinking window.  Being fortunate enough to drink through 15 vintages really highlighted the wines’ capacity to age. The top 2017, 2014 and 2010 vintages were a masterclass in Chardonnay perfected, but it was the supposedly “lesser” years such as 2006 or 2011 that showed the sheer class of both the site and the winemaking.  While Dominique Lafon has long been the face of the estate, we were joined by his daughter Léa Lafon who – alongside her cousin Pierre – is leading the estate into a new era. The new generation is looking to the future and continuing her father Dominique’s relentless drive for continual improvement and innovation, while protecting her father’s legacy. Her mission remains the same: to produce the greatest possible expression of a year, adapting as needed to that single window in time.  It was exciting to taste with Léa, who was incredibly open about the challenges the estate faced in the past. She explained how the domaine, over the last 20 years, has made important adaptations both in the vineyard and winery that has led, she believes, to big improvements in the wines today. One significant shift has been the reduced use of bâtonnage, producing a more precise, brighter, fresher style of wine. Her desire to continually improve shone through during our dinner and conversation, and it’s clear that the future of this estate is incredibly exciting.  Vertical of Lafon's Montrachet 2017: The first vintage of the evening did not disappoint. In fact it silenced the table, truly setting the tone for the evening ahead. A remarkably powerful rich nose unfurled with ripe lemon, honey, blossom and buttery roasted nuts. It was delicate and refined, yet with deep concentration and levels of dry extract that coat the mouth. Multi-dimensional, multi-layered with extraordinary potential, this is a remarkable effort and was one of the great wines of the night. 2015: This has a ripe nose, but took a little coaxing to showcase the bright, well-defined, rich, ripe fruit. It was dense, bright and full (indicative of the vintage?), but with huge depth and potential. The salinity wasn’t quite as evident as on other vintages from the same era, with this showing a more waxy, honeyed ripeness. Very satisfying and long, with a buttery finish.  2014: As expected, the 2014 leaps from the glass, almost making itself known before any swirling has begun. It was very ripe with pungent limes, lemons and a slight hint of herbs. Smokey and mineral, there’s a touch of struck-match and slate. Once again, the harmony of all the components – weight, concentration, dry extract, acidity – is remarkable. The classic Montrachet power and weightlessness is very evident, clearly a wine for the long-term but how special to try it in an early phase of its evolution. Saline and complex. Classy and rich, simply outstanding.  2013: Considerable reduction evident here, slightly outweighing the fruit and perfume. Lots of slate and struck-match dominated at first, but with air it was rich and bright, with well-defined flavours of honey, ripe lemon, hints of smoke, minerals and an almost chalky finish.  2012: This had a bright, energetic nose of ripe lemon and lime, with a hint of apricot. Everything is aligned and seems to be in perfect proportion – deeply concentrated, but light and fresh – very harmonious and complete.  2011: This was another vintage from this remarkable line-up of triumphs that outperforms the vintage, showing an unbelievable balance of bright, dense, concentrated fruit balanced by high acidity. On the palate, it feels like this could last forever. Lime and minerality hides in the background, with a slightly waxy and tropical finish. Long and memorable.  2010: Standing up to the reputation of the vintage, the ’10 delivers in abundance. It is ripe, but with underlying slatey, chalky, smokiness; tense, but with huge concentration and a core of rich stone-fruit character. Layered and textured, it’s captivating. The wine is complex with hints of honey and nuts emerging with gentle coaxing. The oak is perfectly resolved and integrated. Hugely impressive, standout.  2009: Corked sadly! Though evidence was there behind the TCA of a brilliant wine. 2008: Wow – this was sensational, with a captivating nose of ripe lemon, lime, honeysuckle and even a hint of guava and limey, oyster water. Intense, focused and concentrated, there’s layer after layer of viscous, dry extract balanced perfectly by massive acidity, with citric bite. Very mineral and multi-dimensional, it’s complete and faultless. Hard to say how this outstanding 2008 could be improved in any way at all. Stunning.  2007: More reserved than the very pronounced 2008, this offered fleshy pears, stone-fruit, lemon rind, with slightly less concentration than some of its counterparts, but remained perfumed and charming.  2006: The consensus was the 2006 was one of the stars of the evening – show-stoppingly good, emphasised by what is a fairly ordinary vintage in the Côte de Beaune. It was ripe, almost tropical, but with the characteristic saline, mineral, high-acid backbone found in the top vintages of this extraordinary wine. It was floral, ginger and orange-zest scented, while the palate is sumptuous, multi-layered and penetrates the whole way through. Weightless and powerful, it build to a nutty, saline finish. Extraordinary, it’s surely a contender for wine of the vintage.  2005: This was apparently a tricky vantage at Lafon, with some bottle variation Léa noted, but it was another outstanding ex-domaine bottle on the night. It offered a quieter nose than the sublime 2006, with hints of honeysuckle, candied apple, hazelnuts and ginger. It has a rich core of concentrated, dense, buttery, ripe nuttiness, which follows through to an elevated, slightly floral finish. 2004: Another challenging vintage for Lafon, with some bottle variation possible, the bottle on the night, however, was outstanding. With notes of limey, fresh apples, it has the characteristic marine, saline character, if not as pronounced as other vintages. It has a soft, slightly reticent texture, but an undeniable power, reminding us of the quality on show. Perhaps slightly shorter than previous vintages, but still superb. 2003: Completely not the expected profile for such a warm vintage, this was quite lean and high acid. It’s very pure and seductive, yet still with a saline note, pears, slightly candied apple, cream and a limey finish. Exceptionally long and satisfying. 2002: A very strong showing, this was bright and alive, with a mineral nose showing fresh citrus, with a more rounded and almost silky mouth-feel. With hints of pine nuts, minerals, slate, it was dense and rich but with balancing high acidity that makes for a wonderfully fresh palate and saline finish. Outstanding. 2001: This was perhaps slightly more mature than expected (not a perfect bottle), but was the right side of oxidised, with excellent depth and freshness. Exploring Domaine des Comtes Lafon’s Montrachet

When people say they’ve put their blood, sweat and tears into something, more often than not, it’s a figure of speech. This is not the case for Bimber Distillery founder Dariusz Plazewski, who has put everything into the build of his dream Speyside distillery, Dunphail. The day before we speak, Plazewski was on the roof of one of his new distillery buildings, mucking in and making sure the mammoth project that was a lifetime in the making stays on track.   The Polish-born Plazewski is a third-generation distiller – or more accurately, moonshiner – who emigrated to London 20 years ago. After observing the English craft distilling boom from afar, the trained architect seized the opportunity to put his family’s legacy and knowhow to good use and set about building Bimber, a single malt whisky distillery based in West London. Bimber’s inaugural bottling, The First, sold out within three hours of release in 2019 – and demand has far outstripped supply ever since.    Fast forward three years and Plazewski is mere months away from realising his dream of producing a single malt Scotch whisky. But it hasn’t been easy.   “There are lots of challenges,” he tells me matter-of-factly. When we catch up, after two aborted attempts, the Master Distiller sounds ever-so-slightly weary – and it’s not hard to fathom why. Today, he is speaking from London, where he’s been “sorting out a few things” at Bimber. He’s boarding a flight back to Scotland in a couple of days and then he’s taking a much-needed holiday – where he confesses he will be on email constantly.   Rest is not in his nature. (Plazewski has been pinballing from one project to the next for decades. By the end of 2022, he says he will have “given up” his other business and solely focus on spirits.) Nor is adhering to the status quo.    Since founding Bimber in 2015, the Master Distiller has prided himself on being a bit of a renegade. Where others have embraced modern whisky-making practices, Plazewski has been staunchly traditional in his approach – and it has served him exceedingly well. “Whisky was always my passion and when I found out that there was a craft movement of whisky and gin distilling, I just started researching,” he tells me. “It took me a long time but I wanted to do something different. I wanted to always do something which was a bit old-fashioned.”  Plazewski’s father and grandfather before him (illegally) made wine, spirits and beer in his native Poland – Bimber translates as “moonshine” in Polish – and Plazewski was an eager protégé with a natural talent from a young age. I refrain from asking how young.   “The good thing is that I understand all the production, all the process, all the fermentation, and how to make alcohol,” he tells me. “Not only whisky but how to make any alcohol really. Sense of smell, touch, and all this just naturally comes to me.”   Plazewski says his fate was sealed the moment he travelled to Scotland and fell in love with Speyside single malts. Dunphail was always going to happen – he just didn’t know when. Starting his (legal) distilling career with Bimber was a shrewd decision. English whisky was then a relative unknown, so Plazewski used this scene as his sandbox to prove to himself and others that traditional whisky production should not be consigned to the history books.   Bimber was, and for the time being still is, a small-scale traditional whisky-making operation. Local barley is grown on a single farm in neighbouring Hampshire. It is floor-malted at Britain’s oldest maltster, Warminster Maltings, and hand-mashed. The two copper pot stills are direct-fired (with a flame, as the name suggests, rather than the more modern and efficient method of steam) and fermentation times are twice the industry average at seven days.  These practices are astoundingly rare in today’s modern whisky world. The majority of producers abandoned floor maltings (the method of malting grain by hand on large malting floors) in favour of industrial malting processes and did away with direct-firing stills (in favour of steam) decades ago, deeming them inefficient and costly. While it is possible to find distillers who adopt some of these techniques – notable examples being Laphroaig, Glenfarclas and Bowmore – it is incredibly rare to find a producer who is able or willing to apply all these labour-intensive and budget-zapping practices.   “I will never be a distiller without floor maltings,” he says physically baulking at the idea of producing whisky any other way. “Never. No. For me, it is crucial,” he adds.    With Dunphail, Plazewski is going one step further than Bimber and building his own traditional floor maltings on-site. This will put Dunphail in a highly exclusive group, and the move has received mixed responses from Plazewski’s peers.   “For me it is very important,” Plazewski says. “I know many people said, wow are you crazy because this is hard work, this is lots of involvement, why are you doing it?”  I can’t help asking him the same. To which he says: “Because nobody is doing this anymore and I want to continue this craft, I want people to see how the whisky was made before. I think it is going to be good fun and I think this is going to be a great feature for our distillery.”  In addition to floor maltings, Dunphail’s stills will also be direct-fired – Glenmorangie was the first to install steam-heated stills in 1887 and countless others followed until only a handful of direct-fired producers remained. Plazewski is the first to acknowledge the practice of heating stills in this traditional way is far less efficient and costly but for him it was non-negotiable and vital to produce the highest-quality Speyside whisky possible – fruit-forward, oily and medium-bodied. He is also in the minority sourcing Dunphail’s barley and peat locally. There are undoubtedly easier routes to produce whisky but the mere suggestion is sacrilege to Plazewski.  Steadfast on his goal, Plazewski set about finding the perfect location to produce traditional single malt Scotch whisky. After years of searching, he settled on a location in the heart of Speyside – a typically renegade move as the majority of new distilleries have been built outside this iconic region. He explains: “The location was really difficult and challenging as well to be honest.”  “I love Speyside – it’s my favourite part in Scotland. First of all, it is a great area because it has got microclimate, so it’s not too cold there and it’s not too rainy. And it’s pretty sunny.” Additionally, he says: “Speyside whiskies are my favourite.”  When asked if he feels the weight of this tradition or pressure to produce a stand-out Speyside whisky in one of the most densely populated whisky-making regions in the world, he says not.   “We are tiny. We’re not going to be competing with the big, established brands. Most of the new distilleries are not built in Speyside, they are mostly built in Fife area. And not many are really going the route we are with the floor maltings and old-fashioned techniques we are trying to apply.”  In addition to the many challenges that come with building a distillery to a blueprint that no longer exists, Plazewski has embattled with supply chain issues following Brexit, Covid and now the war in Ukraine. It’s a minor miracle – and a testament to the tenacity of Plazewski – that the Dunphail build is on schedule and production is set to begin, as planned, at the end of the year.   When asked how he feels, Plazewski pauses for a moment, takes a short intake of breath and hurriedly says: “It’s amazing. It’s hard work. I need a break. That’s why I need this holiday because it’s not only physical work, it’s the mental as well – planning everything.”  He pauses again. “It’s been a stressful and challenging time. But we are on schedule, we’ve planned this well.”  After Dunphail is up and running, and Plazewski has trained his dream team to the standard of Bimber, you wonder what’s next. You sense he won’t just stop after realising his Scottish dream, and that there will be a new North Star.    When asked, he responds to the question with a wry smile, indicating this is not the first time it has been posed to him by others, or even himself. “I would say yes, I’m done after this, but people I know and people around me are saying to me, you are never going to stop, you’re going to find something else.  “But I would say I think I’ve done my dream and when this [distillery] is going to be open, I’m thinking to really concentrate and not do anything more. I don’t think I will put too much pressure on myself and my family again.” A seed of doubt creeps in and then he says resolutely: “No, this is it, it’s going to be my dream, it’s going to be super exciting and I’m not going to go for anything else. I’m just going to enjoy the time and share the drams.” We’ll ask him again in five years’ time.   For the time being, at least, Plazewski (and the wider whisky world) is satiated with turning modern whisky-making on its head and bringing fiercely traditional practices back to one of the oldest and most prestigious whisky regions in the world.   Browse all Scotch whisky or read more Editorial

Champagne’s climate can be fickle. Of all the fine wine regions around the world it has to be the most unpredictable. Lucie Pereyre de Nonancourt chuckles as she recalls the countless times she has heard the latest vintage described as “unlike any they have seen in 50 years”. She explains: “We hear this all the time. No vintage in Champagne is the same!” It is the region’s capricious nature that dictates the thought process behind Laurent-Perrier’s prestige cuvée, Grand Siècle. A blend of three vintages, all with very different, complementary personalities, the idea is, that when blended together, they capture all the potential qualities a vintage in Champagne is capable of – but are rarely found in one. While Laurent-Perrier is widely recognised as one of the region’s great Champagne houses, Grand Siècle hasn’t necessarily garnered the same sort of attention as other prestige cuvées. Possibly one could argue this is because it is the only non-vintage Grande Marque prestige cuvée – but it is almost definitely because, up until recently, the vintages that made up each new release of Grand Siècle weren’t revealed. That all changed in April 2019 when the house first released Grand Siècle Itération No 24 in bottle and Itération No 22 in magnum – identifying the blend of vintages and what each brought to the blend. Fundamentally each vintage should bring one of the three elements that can typically define a great Champagne year – structure, freshness and elegance or acidity. There have been just 24 different iterations of Grand Siècle since its conception in 1959. Pereyre’s grandfather and Champagne legend Bernard de Nonancourt first had the idea for the cuvée. (It was Bernard who took Laurent-Perrier from a small Champagne house to one of the region’s most recognised brands.) The concept came to him “from observing nature”, says Pereyre. “Champagne has a difficult climate – every harvest is very different but quality is also very different.” The perfect year didn’t exist. For him, a great Champagne was one that has reached aromatic complexity, without losing any of its vivacity and freshness – and that was the aim with Grand Siècle. Bernard’s concept had three rules. Firstly, it should always be made up of three vintages. Secondly, it should always be Chardonnay-dominant – a signature of the Laurent-Perrier house. And thirdly, it must all come exclusively from the Grands Crus of the Côte des Blancs and Montagne de Reims. Speaking with Pereyre, it becomes clear just how much work and time goes into each Itération of Grand Siècle. Each release is 15 years in the making: once all three vintages have been selected, they are blended then spend at least 10 years on lees. The wines do not see any oak and are made as reductively as possible, another key to the cuvée’s freshness. The wine is only released when ready to drink, but Pereyre is confident each has the potential to age 20, 30, even 40 years without losing its vibrancy. As larger-format bottles evolve more slowly, magnums of each Itération are typically released a couple of years later. Pereyre has spent her life in Champagne. Baptised with Grand Siècle as a baby, it seems fitting that today she is charged with the prestige cuvée. Laurent-Perrier is one of the few Grandes Marques still under family ownership. Her mother and aunt took over from her grandfather in 2010, with Peyeyre joining the business in 2019.  Ever since she joined, Pereyre has been training under the watchful eye of Chef de Cave Michel Fauconnet, one of Champagne’s most experienced winemakers. Fauconnet has been working at Laurent-Perrier since 1974 and headed up the winemaking in 2004. He is also the winemaker of the illustrious Salon (also owned by Laurent-Perrier). Fauconnet has Pereyre studying how each parcel tastes, how it develops and how it works in the blend. While Grand Siècle always comes from 11 Grands Crus – Mailly, Ambonnay, Bouzy, Verzy, Verzenay, Tours-sur-Marne in Montagne de Reims, and Cramant, Oger, Mesnil-sur-Oger, Chouilly and Avize in the Côte des Blancs – the proportion in each Itération is different. “The top of the hill versus the bottom can bring very different expressions to each vintage,” says Pereyre. “All the hard work of Champagne is in the blending – every cellar master knows what they have in mind and what style they want to express. Ever since my grandfather created the first Grand Siècle, it has been the cellar master’s job to try to recreate this style – linear, taut, mineral, a lot of acidity, not too open aromatically – but not too acidic and to have some roundness.” It is still very early days for Pereyre, but she is tasting all the time – the only way to learn, and appreciates she is blessed with a great teacher. With the contents of each Itération now in the public domain, the wine is gaining huge scores from the region’s leading critics – perhaps unsurprising given the pedigree of the vineyards and cellar team. Ahead of the long-awaited release of Grand Siècle Itération No 23 in magnum, we speak to Champagne Laurent-Perrier’s Lucie Pereyre de Nonancourt to find out what’s so special about their prestige cuvée

Laurent-Perrier Grand Siècle: recreating the perfect year

Humble yet with undeniable ambition, Jacques Devauges arrived at Domaine des Lambrays in March 2019 and has wasted no time in making small but significant adjustments at the estate. His appointment was the most recent in a flurry of changes that have made waves in the quiet of Burgundy, after the property was purchased by LVMH in 2014 for an undisclosed sum – the luxury group’s first foray into Burgundy.    While the first mention of “Cloux des Lambrays” dates back to 1364, it was really in the 1980s that its modern reputation was established. The vineyard had fallen into disrepair, but was bought by Roland de Chambure and the Saier brothers in 1979. They installed Thierry Brouin as winemaker and director, together restoring the property to its former glory. Thierry, in Devauges’s words, “rejuvenated” the estate – staying at the helm for 38 years, overseeing the property under three different owners before finally retiring in 2017.  Boris Champy had already been lined up to take over, but stayed a mere two years before Devauges was poached from Clos de Tart (where he’d been since 2015, previously Domaine de l’Arlot). In the humdrum of Burgundy, Champy’s sudden departure was big news – as was Devauges’s sudden arrival, although everyone has remained suitably tight-lipped on the topic.  While Domaine des Lambrays does own some village and Premier Cru Morey-Saint-Denis, as well as some Puligny-Montrachet Premier Cru, the domaine’s reputation is inextricably entwined with that of the eponymous Clos des Lambrays. This remarkable site – one of Morey’s five Grands Crus, along with Clos de la Roche, Clos Saint-Denis, Clos de Tart and Bonnes-Mares – was originally classified only as a Premier Cru. It was only in 1981, under Thierry Brouin’s tenure and significant work in the vineyard, that the site was rightfully upgraded – making it the last of Burgundy’s 33 Grands Crus to earn its status.  Such is its association with the domaine that Clos des Lambrays is often mistaken for a monopole; however it isn’t quite. One ouvrée – less than 0.2 of the total 8.84 hectares – at the bottom of the clos belongs to Taupenot-Merme. Originally a vegetable garden, it was planted with vines in 1974, and produces a tiny amount of wine (no more than one barrel in the most generous years).   Visiting in October 2020, it was clear that Jacques Devauges has big plans – and if 2019 is anything to go by, there is much to look forward to. Coincidentally, Devauges wasn’t new to the estate – having worked briefly in the winery under Brouin in 1997. He’s full of praise for Brouin’s work and clearly wishes to respect the enormous legacy he’s been handed. His aim, however, is to recreate the old Domaine des Lambrays of the early 20th century – before the vineyard fell into disrepair in the 1930s.  There have already been a few shifts, with the construction of a new winery underway and 2019 the first fully organic vintage, and the property – as of 2020 – in conversion to biodynamics. This is no small feat given some of the site’s peculiarities. After phylloxera, the vine rows were planted north to south, perpendicular to the slope. This is an angle that little machinery can handle (with a serious risk of toppling over) and as such almost all the work here has to be done by hand, however Devauges has had a special tractor made that can handle the site’s undulating terroir. A relatively large site, it’s unsurprising that the soils here vary. While broadly speaking it is a rocky clay, the bottom of the site is heavier clay and loam, while the midslope is more gravelly over deep limestone, and the very top has shallower limestone soils. As he gets to know the Clos, and differences between each sub-parcel, Devauges is vinifying each one separately, laying the barrels out in the same way as the vineyard – so he can figuratively walk the rows, identifying the character of each. For Clos des Lambrays, he has divided the site into 10 sub-plots (see the map below), however he identifies three major sections of the vineyard: the section near Clos de Tart, the middle and then the side closer to Clos-Saint-Denis.  Tasting three components of the vineyard separately, and then together, with Devauges was enlightening. First up was La Plante Dessous, on the Clos Saint-Denis side, home to some of its “youngest” vines – which are still 40 years in age. The wine produced here is tight and intense, building gradually in the mouth with silky tannins and an amazing purity of blueberry and blackberry fruit. Cerisier, a plot at the bottom of the slope near Clos de Tart, is drastically different. This is full, exotic, rich and ripe – yet with a real freshness and a chalky minerality beneath. The final section we tasted was 80 Ouvrées Dessus – right at the top, middle part of the vineyard. Angular and structured, it showed remarkable energy and intensity – a core of vibrant blue fruit and firm tannins. In the resulting final blend, you can feel every element – except with the dial turned up to max.   Unlike Brouin, Devauges feels it is important not to select the best barrels, and “blend” a wine, but to seek “as much truth as possible”. While he is declassifying the very youngest vines (those under 20 years in age) to their Premier Cru bottling, he feels that they have a responsibility to capture the site in its entirety – using whatever nature provides. “Here, we are farmers,” he says modestly, with a suitably Gallic shrug. The resulting wine is the one true expression of this site – and that’s clearly where Devauges’s focus lies, something that will doubtless evolve in the coming vintages. “Every year is a new page,” Devauges told us. 2019 BOURGOGNE BLANC, DOMAINE DE MONTILLE The specific clones of Chardonnay used in De Montille’s Bourgogne Blanc make it particularly special. Most Bourgogne Blanc is made with higher-yielding clones which have a tendency towards dilution; but De Montille’s Bourgogne Blanc comes from a single site that borders Puligny-Montrachet, planted exclusively with low-yielding clones. This shines through with impressive density on the palate. The wine retains that mineral-edged De Montille style, fleshed out with pear and juicy white melon fruit. 2019 CORTON-CHARLEMAGNE, GRAND CRU, HENRI BOILLOT While not exactly cheap, the Boillot wines still offer great value – competing happily with the likes of Leflaive, Coche-Dury and Ramonet. In 2019, their wines really shine – balancing the concentration of fruit with thrilling acidity. Their Corton-Charlemagne is extraordinary – the power of this site instantly in evidence. The wine is a coil of minerality and citrus, poised and wound tightly. There’s a smokiness to the nose, with a struck-match intensity countered by what feels like a tsunami of fruit – lime, green apple and white peach. Mouth-filling and rich, expansive yet zesty, the acidity drives an astonishingly long finish. Muscular, poised, razor-sharp and full of potential. 2019 CHABLIS, GRAND CRU, LES CLOS, REMOISSENET PÈRE & FILS Remoissenet has friends in high places – and although we can’t say who, one of the region’s most respected and collected producers sources their Chablis. Their wines are – unusually for Chablis – 100% barrel-fermented, producing texturally rich, powerful wine that cleverly never loses its sense of place. In 2019, this opulent style has never suited the vintage better. The nose of Les Clos is very pure with fine, subtle florals. Notes of comice pear, crystallised lemon rind and dried citrus fruit oscillate with the rounded, rich and creamy texture of the wine. The oak is layered over a very pure core of fruit, with a classic sunny Les Clos typicity. On the finish, the wine tightens up nicely and ends with real mineral focus and salinity. Superb. 2019 SANTENAY, BIEVAUX, ALVINA PERNOT The Bievaux vineyard belongs to Alvina’s grandfather Paul Pernot and has long been the family’s favoured site for Pinot Noir. High up on the hill and directly south-facing, the vineyard benefits from ideal sun exposure and cooling diurnal influences, producing a wine with lovely texture and balance. The tannins are fully resolved but the wine has energy and spark too. These 40-year-old vines produced a fantastically juicy, moreish wine in 2019 (at a great price).  2019 CHAMBOLLE-MUSIGNY, DOMAINE HUDELOT-NOËLLAT Charles van Canneyt only made 25 barrels of his village Chambolle this year, versus the normal 40 – which is a particular shame given the quality. It’s a blend of 11 parcels from all around the appellation, to give a true “village” wine. He opted for no punch-downs in 2019, as the skins gave up their colour and tannins so quickly. The resulting wine is surprisingly dark and intense in style, such is the concentration of the year. Nevertheless the wine has a real crunch of red fruit, with amazing acidity and elegant tannins.  2019 GIVRY, PREMIER CRU, CLOS DE LA SERVOISINE, DOMAINE JOBLOT We could have put any of Joblot’s wines in this list – such is the value offered by this superb Givry producer. This south-facing plot is next door to Cellier aux Moines – which Joblot also works with, and tasting the two alongside each other is a treat, with such contrasting styles. This is the brighter of the two, with more lift and perfume on the nose, but the palate reveals darker and more savoury depths. Concentrated bramble fruit is framed by chalky tannins and vibrant acidity. Delicious. 2019 MERCUREY, PREMIER CRU, LE CLOS DU ROY, DOMAINE FAIVELEY The Faiveley family (now in its seventh generation) is today France’s 35th richest family – but it was railway technology, rather than wine, that made their fortune. It means that winemaking for the domaine these days is a purely qualitative affair, with a no-expense-spared approach taken with all their wines. This really is a winwin for the drinker. Being the largest producer in the Cote Chalonnaise, their Mercurey Premier Cru Le Clos du Roy is not only exceptionally made, it is also extremely well-priced. In 2019, this wine has captured the dynamism in the best examples of the vintage, full of energy with lovely crunchy red berry fruit and a sapid salinity on a long finish. Incredible quality for the appellation.  2019 SAVIGNY-LÈS-BEAUNE, PREMIER CRU, LA DOMINODE, DOMAINE JEAN-MARC & HUGUES PAVELOT Hugues Pavelot has crafted a wonderful range in 2019 – toning down extraction given the ripeness, and turning up the whole-bunch to add freshness (with between 15 to 30% on the Premiers Crus). La Dominode was a star of the tasting, however. It manages to effortlessly combine a subtle, chalky grip with a silk-like mouth-feel. The fruit is ripe, smooth and lush but also crunchy and bright – a mouthful of crushed raspberries and blueberries with a burst of redcurrant acidity rushing through the palate. There’s a mineral freshness to this full yet fine wine. Lovely. 2019 VOUGEOT, PREMIER CRU, LES PETITS VOUGEOTS,  DOMAINE HUDELOT-NOËLLAT Charles van Canneyt has 0.5 hectares of this Premier Cru, sandwiched between Clos de la Perrière and Le Clos Blanc. It’s one to watch – and a site that Charles thinks is benefiting from global warming, thanks to its limestone soils. In 2019 the wine is dark, rich and intense but with bright, sweet berry fruit that also has a vibrant crunch to it. Refreshing acidity balances the plush, dark cherry fruit on the palate, while delicate notes of violet florals and black tea fill the finish.  2019 CHEMIN DES MOINES DE VERGY, DOMAINE GROS FRÈRE & SOEUR, VIN DE FRANCE This is only the third vintage of this delicious curiosity from Gros Frère & Soeur. Planted in 2014 and 2015, this plot sits at the top of the Côte, beyond the borders of the Burgundy appellation (hence its Vin de France status) and at high altitude. Overlooking the Grands Crus of Vosne-Romanée, the vines are trained high – with a full 2.5 metres’ worth of canopy to capture as much sunshine as possible at these cool and dizzy heights. The resulting wine is supple, soft and bright, with crunchy sour cherry and redcurrant fruit. Light and fresh, with a long finish of vibrant acidity, it’s a fun addition to the range – and one that will be interesting to follow in the coming years as temperatures continue to rise. 2019 VOLNAY, PREMIER CRU, DOMAINE GEORGES LIGNIER The Lignier family line runs through Benoît Stelhy’s mother’s side, but his father’s side also as vines, with 46 acres in Volnay and 12 in Pommard. They’re old vines and he buys the grapes in, although works closely to manage the vineyards in the same way as his own, with grass cover all year. He picks the fruit himself though with family and friends helping – “It’s a little bit like we go on holiday,” he tells us, travelling down to the Côte de Beaune to harvest, normally on a Sunday morning. His Premier Cru Volnay was a treat to taste – pretty and perfumed, it’s laden with bright, crunchy red berries, but there’s a mineral line that lends finesse. Dainty, fine and truly delicious. 2019 MOREY-SAINT-DENIS, PREMIER CRU, CLOS SORBÉ, DOMAINE HENRI & PHILLIPE JOUAN Philippe Jouan’s wines certainly fly under the radar – and with the current quantities produced, this is unlikely to change anytime soon (with just three hectares in total). However, the little wine produced here is an honest rendition of some exceptional terroir in the Côte de Nuits – and, with the 2019 vintage, the wines have never tasted better. Our pick of the range was his MoreySaint-Denis Premier Cru Clos Sorbé, one of the top Premier Cru sites in Morey. The wine is wonderfully intense with an expressive, complex nose of lavender, rosebush and incense, while the palate is ripe and juicy with sun-kissed wild blackberry and blueberry fruit. 2019 CHAMBOLLE-MUSIGNY, PREMIER CRU, LES CHABIOTS, ALBERT BICHOT Les Chabiots sits above Les Amoureuses – pedigree that seems to escape most people. It’s singing again in 2019, a delicate and fine-boned wine with a nose full of violets. But don’t let its prettiness deceive you, there’s plenty of power to back it up – with a core of raspberry and bright red cherry fruit, supported by a backbone of minerality. Markus Molitor has been working in the vineyards since he was ten years old, literally becoming his father’s right-hand man after his father Werner lost his arm in an accident, “He needed support and help in the vineyard and cellar – so I became his right hand. He taught me all about viticulture and vinification and I spent every free minute with him in cellar or vineyard. I did not only learn every single step of winegrowing and winemaking, but I also took over his passion and enthusiasm.  One day we stood on the foot of Zeltinger Sonnenuhr vineyard site and looked up. My father told me about the glorious times of Mosel Riesling at the beginning of 20th century. I understood that the vines in these parcels, which were approx. 100 years old, were still the same.  So I asked myself: What has happened? Why do the wines not have the same reputation when all the preconditions have not changed at all? And that was the moment of inspiration for me. Since then my ambition has been very clear: I want to try to help restore the wines of our Mosel valley to their former glory by producing unmistakable Riesling wines true to their individual vineyard identity.” Markus took over control of the estate in 1984, which at that time amounted to just 1.5 hectares of the vineyard site Wehlener Klosterberg. Since then he has enlarged the holdings to 120 hectares comprising of many of the top Grand Cru sites on the steep slopes of the Middle Mosel and further south in Saar region. Markus Molitor is now among the largest privately owned estates in Mosel. 90% of the 120 hectares are planted with Riesling and various Pinot varieties. The goal has always been to produce very distinct expressions of each of the vineyard sites dotted throughout the Mosel  - “We try to express each individual character of vineyard in combination with each quality level, style and vintage. Therefore we harvest all of the vineyards by hand only to have the possibility of selecting each single berry in its own category. This work and time-intensive process leads to approx. 80 to 90 different wines per vintage, but each one absolutely unique in its composition and taste.” The whole team of workers in cellar, vineyards, office, warehouse and sales consists of approx. 80 people.  But this increases close to 120 people during the work intense period during the early summer months. Mapping the vineyards 1980-1990s To fulfil Markus’ ambition to reinvigorate the reputation of the great vineyards of Mosel he first began to focus purchasing the Grand Cru Sites of the Middle Mosel area beginning in the 1980s gradually buying more and more selected sites right through the 1990s. “One needs to imagine that until that time, it had been nearly impossible to obtain any plots
in these famous steep slopes.  Families passed these on from one generation to another. But in the 1980s the Mosel wine industry was completely devastated due to the glycol crisis and the overriding reputation of the mass-produced off-dry wines (highlighted in my “History of Mosel” article).  Nobody wanted to work the steep vineyards anymore. So for the first time in history, people offered it for sale or rent. I took the chance given and enlarged the vineyard surface to approximately 20 hectares in these vineyard sites.“ Asked what is so special about the steeper slopes of Mosel and the effects this has on the final wines Markus explains – “There are several advantages of steep slopes in comparison to flat vineyards. First of all the sun exposure: if the steep slope is south-facing, the sun moves
around each single vine from morning to evening. Secondly, the aeration is better because the winds blow down the slopes – the risk of frost is minimised, the heat as well as the humidity are carried away.  During the Indian summer prior to harvest, the temperatures may be quite warm during the day. The valley is narrow, so the heat is trapped in the valley. During the nights, the cold winds from the Eifel and Hunsrueck hills above fall down the steep slopes. These changes of warm and cool air contribute a lot to the formation of the unique Mosel-aromas in the Rieslings. Depending on the steepness and therefore the angle of incidence, the sunlight is reflected by the river in the vineyard and afterwards stored by the slate soil. It is the combination of all these points that leads to the unique effects of the steep slopes in our valley along with the interaction of the slate soils with the old vines."
 2000-2020 From 2000 onwards Markus started to purchase vineyards further south in the Saar Ruwer district. “I rented the first parcels in the vineyard site Niedermenniger Herrenberg in
the Saar river valley. This region really has its own character. The Saar and the Ruwer represent special variations of the Mosel Riesling. The side valleys are located at a slightly higher altitude and they are not as narrow. The average temperature is therefore a bit lower than in the Mosel region.  Due to these facts the vegetation period takes a bit longer (approx. 7-10 days). All of these components lead to Riesling wines with higher acidity, a bit more intensity, and a sharp and clean mineral expression and lighter fruit flavours than in the Middle Mosel region." In 2012 Markus was able to also secure some parcels in the famous steep slopes of Saarburger Rausch and Ockfener Bockstein in the Saar-Ruwer part of Mosel. In 2016 Markus got the chance to buy the former Staatsdomaine of Serrig which was built in 1903 by the Prussians, one of their government-led quality-driven wineries. Markus explains:  "It was 25 hectares of vineyards in one go, a unique possibility that I could not resist." As you go further east along the Mosel river and enter what is called Middle Mosel (identified into two separate regions named after the main towns of Piesport and Bernkastel and it is here the wine character changes slightly.  Markus explains: “The wines coming from Middle Mosel area are “warmer“ in taste: the fruitiness which often reminds me of exotic tropical fruits is more in the foreground, the wines are lush and rich in body. They are a bit smoother in acidity and pretty round in taste. However, it is worth noting that the differences between the areas have gotten much smaller over the last two decades due to the climatic change we are all faced by.“ In 2013 Markus expanded his vineyards east and took over parcels in the Kinheim district, namely in Kinheimer Rosenberg and Kinheimer Hubertuslay. “For me these vineyards were completely underrated and underestimated, therefore I wanted to (and I still want to) show their quality and make them famous all around the world.” During the last five years, Markus took the chances to piece together what he describes as his “personal jigsaw” of Grand Crus sites in the Middle Mosel area including the legendary Bernkasteler Doctor, Brauneberger Juffer (and Juffer-Sonnenuhr) as well as Erdener Prälat.  
 After 35 years of buying up single plots all over the region I ask what vineyards have become his favourites, he states, “It is like asking a father: which one of your children do you favour? It is hard to say which are more special than others due to the uniqueness of every single site, microclimate, steepness, slate soil composition, sun exposure, vines etc. All I can say is I believe all of them are justified to belong to the best vineyards of Mosel, of Germany, some even of the world and everyone of them has its own character. 
 Single vineyard characteristics and what defines them Identifying what is specific about the different vineyards along the Mosel is not simply geographical. Whilst Saar Ruwer is quite geographically and climatically different to Middle Mosel, each of the villages dotted along the Middle Mosel don’t simply represent different
styles of Riesling, the type of slate is perhaps a stronger factor.  Markus goes on to explain: “The character of a wine does not only depend on the village or better the vineyard site where it comes from. There are many more aspects influencing the taste and structure of a wine. The particular type of slate is responsible for the mineral and aromatics, as well as the acidity structure of the wine.  "It is distinguished by very specific local mineral compositions (mainly blue, grey and red slates, but there are many forms in between). In addition to that it depends a lot on the microclimate of the single parcel, on the slope and the sun exposure of the site, and those effects on the slate soil composition. There is also the age of the vines as well as their clones – and last but not least, it all depends on the philosophy of the winemaker. In general, we manage all our vineyards the same way. The work in the vineyard is of central importance because here the foundations are laid for physiologically ripe grapes full of extract to express their specificity of location.”
 Slate soils 
 The Mosel wine region is defined by its slate soils. All of Molitor’s vineyard soils are composed of slate – in nearly infinite variations. The main difference is the colour: grey, blue and red. But there are huge variations from vineyard to vineyard. Markus goes on “slate is a
very smooth stone which means that it can be very weathered. The stones may be splintered by hand. The vines´ roots are able to grow through the stony soil down to ten to twelve metres deep. They can collect many minerals through the different layers and transport it into the grapes (and therefore in a second step into the wines). It is distinguished by very specific local composition.  The slate reflects the sun and stores the heat so that the day and night temperature difference, especially during harvest, is not as high as in vineyards with other soils and therefore grapes do not only have light and warmth from above, but also from down below. In combination with the microclimate in the single vineyard site, the vines and the winegrowing philosophy, the wines vary from plot to plot: you may always recognise them as Mosel Riesling, but there are infinite possibilities from light to heavy, from expressive in mineral to spicy fruitiness, from cool to warm characters.”  Ungrafted vines "The character of a Riesling does not only depend on the age of vines, but also on the genetics grown in the vineyard. There can be young vines producing wines as full of character as from old vines, but these are really rare. In our vineyards we only plant selection
massalle, old genetics, because not only the age of vine, but the combination of both is crucial." "The ungrafted old vines in Mosel are getting rarer every year due to land consolidations. The winemakers are not allowed to plant ungrafted vines any longer because of the risk of phylloxera. But one is allowed to keep the old stocks in old plots. The root system of old vines is unique, it cannot be imitated.  Roots grow down to twelve metres deep in the mineral soil. They may take a lot of minerals into the grapes. The proportion of wood in comparison to the leaves and fruits is very high. Therefore the yield of old vines is extremely low – but the concentration of extracts and minerals in the juice of every single berry is extremely high. All these points lead to an incomparable structure and great texture in the wine. The balance of all components, mineral, acidity, fruitiness and sweetness is always given and inimitable."
