Just over 25 years ago, French fashion house CHANEL entered into the world of fine wine, purchasing the largely underperforming Margaux Second Growth estate Château Rauzan-Ségla. Two years later they acquired the Saint-Emilion Premier Grand Cru Classé, Château Canon. They have since turned these properties into two of the most in-demand fine wines in Bordeaux today. In 2019 CHANEL embraced their latest endeavour, acquiring Domaine de l’Ile, a prestigious wine estate on the French riviera on the exclusive island of Porquerolles, the largest of the “golden” islands just off the Côte d'Azur. Sharing the same philosophy as their sister wineries, they have invested in a stellar winemaking team at the Domaine, enlisting the help of Pierre Etcheberry and celebrated winemaker Nicolas Audebert (of Châteaux Rauzan-Ségla and Canon). Nicolas Audebert is in fact a local to the region, born and raised in the nearby port city and naval base of Toulon. We caught up with him to discuss returning to his roots in Provence and to find out what makes this idyllic island so well-suited to fine wine production. “I was born in Toulon. My father was a naval officer, so we used to travel a lot, living in different countries, but we would always return to Provence. Porquerolles is a very special place to me as we would spend time sailing there with friends and family.  Probably my strongest memory of when we were kids is sailing with my family and spending nights “au mouillage” on the Notre Dame beach. My brother and I would wake up early in the morning with a mission:  buying some bread in the village. We would spend the whole morning walking on the back trails, discovering the island and its incredible nature, guided by the eucalyptus perfume to finally reach the Place d’Armes, where the bakery is. By the time we were back on the boat, it was lunchtime.  As a child, Porquerolles was the epitome of nature and freedom.   My travels and the great outdoors are part of my DNA, that’s why I decided to study Agronomy and then Oenology in Montpellier. Winemaking took me to Champagne, South America, Bordeaux... Today, coming back to Porquerolles is like coming back to my roots - and making wine there is the icing on the cake.”  The history of Domaine de l’Ile The island of Porquerolles is a place of idyllic beauty with a fascinating history. First inhabited in 1820, the island was largely destroyed by a devastating fire at the end of the 19th Century, before being auctioned off in 1910. The island was acquired in its entirety by François Joseph Fournier, who as Nicolas explains, “was a man of many lives”; the son of a poor Belgian boatman, he became fabulously rich thanks to his discovery of the largest seam of gold ever found in Mexico. Fournier was the sole bidder in the auction of the island, which was a wedding gift to his wife, Sylvia. They actually established vines on the island almost immediately, planting vineyards on different strategic plains of Porquerolles. Under their visionary and watchful eye, the island reclaimed its agricultural character. It sprung back to life; an oasis in the middle of the Mediterranean. The vines populated its gentle slopes and fuelled the chatter in the village. The vineyards were in fact some of the first in the region to be classified as Côtes de Provence, due to the quality of the wine produced. In 1957, the island was divided up between the four Fournier daughters; each one received a plain. Progressively, three of them sold their inheritance to the French government, but Lélia Le Ber (neé Fournier), fought to keep her land and replanted vines on the Brégançonnet plain.  She passed on the estate to her son, Sébastien Le Ber, who managed the family business before entrusting the site to CHANEL, opening a new chapter in the story of Domaine de l’Ile.  From the Classed Growths of Margaux and Saint-Emilion to Provence Asked why CHANEL decided to invest in a new winery, and in particular in Domaine de l’Ile, Nicolas explains that it was "love at first sight" with this island vineyard in the heart of Provence, its special terroir, the Le Ber’s philosophy of Porquerolles and their unique history. “As we took over Domaine de l’Ile in early 2019, Pierre Etcheberry joined the estate’s team as Vineyard Manager. Pierre has an Agricultural Engineering degree and spent three years at Château La Fleur in Bordeaux as Assistant Technical Director.  At Domaine de l’Ile he is now in charge of the winemaking, vine growing and day-to-day management. Pierre stays in touch closely with the teams in Bordeaux, and they visit regularly whenever their support is needed.”   In the vineyard The individual parcels of Domaine de l’Ile were delimited and planted in 1957. While Porquerolles shares similarities with Provençal rosé in terms of the soils and climate, it remains unique because of the insularity specificities, explains Nicolas. “Being an island, Porquerolles has a unique ecosystem: vines grow on orogenic schist bedrock and clay soils, vines are surrounded by wild and protected fragrant flora, under a warm Mediterranean climate and are exposed to fresh saline winds.  The unique environment of the vineyard has a real influence on Porquerolles wines. Surrounded by the sea, growing on an exceptional soil under seasonal high temperatures and exposed to salty winds, the Porquerolles vines produce wines of character with a fresh tension and saline notes. Pine trees, eucalyptus and wild flowers frame our parcels, this very rich naturally odorous environment finds its illustration in our wines, in delicate flavours.” “The blend of grapes in the Domaine de l’Ile rosé is made up of Grenache, Mouvèdre, Cinsault, Syrah and Tibouren.” For Nicolas, these traditional Mediterranean grape varieties express all the uniqueness and insularity of the Domaine de l’Ile wines. “On dry and stony soils, enduring the wind, gorged with sun, the Grenache brings generosity to the blend, a reminder of the sweetness of local life. The Mourvèdre likes to watch the sea. It affirms all its character here and adds its grains of spice. A window opens on the pine forest. The white flesh fruits of Cinsault combine with the freshness and crispness of Syrah. As for the Tibouren, authentic Provençal, it is at home here, deploying its nobility on these shale soils.”  Life on Porquerolles The idyllic picture postcards of the island don’t lie; Porquerolles is exceptionally beautiful. Such landscapes are due to its protection, conservation and very real isolation. During summer, thousands of visitors discover the good life of Porquerolles, exploring the local restaurants, community and the beautiful coastline by walking, biking or sailing. But once the high tourist season ends, nature takes back its rights. Spring is sweet but autumn and winter can be difficult. To live on Porquerolles is a real philosophy of life, a desire of being out of “the continent”, a place where time flows slowly.  Finally, we asked Nicolas’ thoughts on rosé wine more generally and where and when best to enjoy it. “Rosé is the traditional wine of Provence, a region that has nothing left to prove. It designates wines of incredible diversity that can be found on the most prestigious restaurant wine lists all around the world.  From the ones to be enjoyed between friends over a simple supper, to some brilliant and complex expressions of terroir paired with more elaborate menus. For me, when spring begins to bloom, and temperatures rise, opening a bottle of a rosé wine offers you a promise, a foretaste of the coming summer. And in autumn, or even in winter, it will put a smile on your face, as an opportunity to remember the joy and pleasure of the long-gone summertime. Bordeaux is arguably the world’s most famous wine region – known for producing some of the finest wines in existence, with a long history stretching back to the Roman era. But the region is broadly divided in two – the Left and Right Bank. (Terms that you may also hear in reference to Paris, and – less frequently – Chablis.)  The region is defined by its waterways – a forked tongue that snakes southeast from the Atlantic. The Gironde estuary is fed by the Dordogne and Garonne rivers, with the Gironde flowing into the Atlantic. The south-eastern side of the Gironde and Garonne is the Left Bank, while the north-western side of the Gironde and Dordogne is the Right Bank. The section of land that sits between the fork of the Garonne and Dordogne is the intuitively named Entre-Deux-Mers (literally translating as “between two seas”), and is mostly home to more everyday, entry-level wine – although quality has certainly improved here with both climate change and technical advancements (such as Ch. Marjosse).  The Left and Right Banks, however, are where you’ll find Bordeaux’s most illustrious names. While both regions craft exceptional wines, they are extremely different in terms of terroir, the grapes grown, the estates themselves and how the wines are classified.  The Left Bank The Left Bank is the aristocratic and historic home of fine wine in Bordeaux, famous for the 1855 classification of the Médoc, a ranking of the top estates of the region which still stands today, including the fabled First Growths – Ch. Latour, Ch. Lafite Rothschild, Ch. Mouton Rothschild, Ch. Margaux and Ch. Haut-Brion.  It was Bordeaux’s ties to England that saw it rise to prominence – after Eleanor of Aquitaine married Henry Plantagenet in 1152. With Bordeaux under English rule, favourable tax rates saw the industry thrive. But the Médoc was, at that point in time, a marshland not worthy of wine-growing – with the best wines coming from Graves estates like Ch. Haut-Brion (where vines have been grown since at least the early 15th century).  It was only in the mid-17th century that the Dutch drained the marshy Médoc, creating the well-drained gravel soils that are now a haven for Cabernet Sauvignon. It was after this that most of the region’s grandest properties were established.  The aforementioned 1855 classification cemented the Médoc’s place in history, with the wines of Sauternes and Barsac categorised at the same time. The wines of the Graves were classified in 1959, while the Left Bank is also home to the Cru Bourgeois and Cru Artisan classifications.  The Left Bank encompasses, from north to south: the Médoc (which includes the prestigious communes of Saint-Estèphe, Pauillac, Saint-Julien, Margaux, as well as Listrac and Moulis), the Haut-Médoc, Pessac-Léognan and Graves, as well as Barsac and Sauternes. Although the area of course encompasses dry whites and sweets, stylistically “Left Bank” is used mainly in reference to the reds, which represent the vast majority of production.   The soils on this side of the Gironde are dominated by gravel, with the best sites sitting on deep gravels over clay subsoils. The vineyards are more spread out here, with patches of woodland and other agricultural land between the pockets of fine terroir, making distances and journey-times between estates longer. The gentle, barely undulating landscape masks significant differences in the soils, which determine the success of a site, with the mounds divided by streams known locally as “jalles”. Deeper gravel has historically been a significant advantage in the region’s maritime climate, avoiding water-logging and retaining heat that helps to ripen the grapes. Proximity to the Gironde and its moderating influence can also help shield vines from frosts, an increasing threat in the springtime.  Estates can be quite large on the Left Bank – for example, Ch. Cos d’Estournel comprises 100 hectares – allowing for higher production levels, which means the wines tend to be more widely available and can be found more easily on the secondary market, even at the highest quality level. The properties also tend to have picture-perfect châteaux, immaculate architectural displays of the wealth of the region.  Cabernet Sauvignon leads the way in terms of plantings, thriving in those warm gravel soils (and complemented by parcels of Merlot, Cabernet Franc and Petit Verdot, with some limited Malbec and Carménère). The variety produces small berries with thick skins, creating tannic, age-worthy reds.  The wine style varies between commune and estate, but generally speaking the wines of the Left Bank are dominated by graphite, cassis and blackcurrant leaf, full-bodied yet with a more linear structure that Cabernet Sauvignon provides. Historically the wines were austere in youth and needed time in the cellar, but wines today are made to be more approachable so that they have longer drinking windows. With age, the best wines develop beautiful complexity with notes of leather, cedar, tobacco and more.  The Right Bank The most famous wines of the Right Bank come from Saint-Emilion and Pomerol, however it is also home to: the Côtes de Blaye, Côtes de Bourg, Fronsac, Canon-Fronsac, Lalande-de-Pomerol, Côtes de Castillon, Côtes de Francs and the Saint-Emilion satellites – Lussac-Saint-Emilion, Montagne-Saint-Emilion, Saint-Georges-Saint-Emilion and Puisseguin-Saint-Emilion.  Although wine has long been made on the Right Bank, the wines – other than those of Ch. Cheval Blanc – were not known widely until relatively recently. The region’s modern history is tied to one man – the influential critic Robert Parker. He was one of the first to highlight the quality being produced at smaller Right Bank estates in the 1980s and 1990s, and put the wines on the international stage. His penchant for rich, ripe, concentrated styles prompted a wave of producers who did extensive green-harvesting, working with tiny yields, picking late, extracting heavily and ageing in new French oak, a style favoured by the far-reaching and famous consultant Michel Rolland.  Pomerol became home to the “garagistes”, after Jean-Luc Thunevin crafted his first vintage of Valandraud in his garage in 1991. These modern producers, who didn’t come with the land and smart châteaux found on the Left Bank, captured the imagination of consumers, and rapidly became highly sought-after.  Fashions have changed for the most part, and the wines produced today across the Right Bank are significantly more restrained – reflecting the general move toward freshness and aromatic finesse.   Of course, one reason that the wines of the Right Bank were less well-known was the smaller size of estates and therefore smaller volumes being produced – especially in Pomerol. Pétrus, for example, consists of 11.5 hectares, while Ch. Lafleur is a mere 4.5. In Saint-Emilion, Ch. Cheval Blanc and Angélus both have 39 hectares – a more generous vineyard area, but still relatively small in comparison to those in the Médoc. This means that the wines from the top estates are often strictly allocated and can be very hard to secure, with significantly less available on the secondary market.  The area feels very different to the Left Bank, with a more rolling landscape with more nooks and crannies, meaning you often can’t see what lies over the hill. The soils here are also significantly different, dominated by clay and limestone, with some sand and gravel. These soils stay cooler and retain more water, something that can be very helpful in hot, dry seasons (as in 2022). The finest wines come from the limestone plateau at the heart of Saint-Emilion and Pomerol plateau, with its pockets of rare blue clay. Limestone has an additional benefit of retaining freshness and acidity in the wines, with wines from limestone-dominant soils often having low pH.  Plantings are dominated by Merlot and Cabernet Franc (sometimes known locally as Bouchet), rather than Cabernet Sauvignon (which can struggle in the damp soils, although producers are planting a little more of the variety in response to climate change). Many wines from Pomerol are 100% Merlot (with estates such as Vieux Château Certan notable exceptions), while in Saint-Emilion the blends tend to include more Cabernet Franc. Merlot produces larger, thinner-skinned berries, and therefore Right Bank wines are generally softer, plusher, with a rounder texture, softer tannins, often floral with a redder fruit profile (cherry, plum), and can sometimes be exotic in perfume.   Unlike on the Left Bank, most of the wines are not classified formally, however Saint-Emilion introduced its own classification in the 1950s – one that has become a source of controversy.  Beyond Saint-Emilion and Pomerol, the other appellations can produce some fantastic wines, and – given the difficulty with buying additional land within these two illustrious areas – many of the Right Bank’s leading names have estates here (such as Ch. Lafleur’s Grand Village or Perrières, and LEglise-Clinet’s Montlandrie or Les Cruzelles). These can be a great source of value.  It’s worth noting that vintages are sometimes described as “Left Bank” or “Right Bank” years, and it is true that conditions can sometimes favour one side over the other, however the picture is often more complicated and results can vary according to individual estate, as well as commune.  Read more about Bordeaux or browse all Bordeaux listings

JAMES SUCKLING James Suckling was the first out with his report, published on 19th April, before most people have made it out to taste the new vintage. He’s not shying away from calling this a truly great vintage, saying “it sets a new benchmark for Bordeaux”. It’s the 40th vintage he has tasted en primeur, and he feels it proves the region’s ability to face the challenges of climate change, with its uniquely hot and dry conditions. He notes that while the reds are the undoubted star, it is also a great vintage for Sauternes – with botrytis development in mid-October that produced exceptional wines.  While the growing season urges parallels with 2003, the wines are totally different. The 2022s “can be flamboyant, fruity and tannic, yet they have a freshness and form that give them energy and vitality”, he writes. While he found a few wines that were over the top, he generally felt there was consistent quality across the spectrum, from more modest estates to the grandest châteaux, with the wines “exceptional”. He gives nine potential 100-point scores, versus only one last year (for Lafaurie-Peyraguey in Sauternes – an address he also praises this year).  Suckling’s highlights: Cheval Blanc, Lafaurie-Peyraguey, Lafite-Rothschild, Le Pin, Léoville Las Cases, Pontet-Canet, Trotanoy, Pavillon Blanc du Ch. Margaux, Angélus, Canon Read James Suckling’s full report  WILLIAM KELLEY – WINE ADVOCATE  Publishing his report on the Friday of Primeurs week, William Kelley defines 2022 as “an amplifier” – highlighting differences between sites and how producers work both in the vineyard and winery. “Bordeaux has produced some monumental wines in 2022, but unlike many of the great vintages of the 20th century, the year was not a rising tide that raised all boats,” he says. The best wines offer “remarkable concentration, energy and harmony” but there are some that are “jammy, astringent and rustic”. He highlights that those with higher organic matter in their soils and who managed their canopies well were rewarded. He argues that vines adapted to the long, dry season, and the experience of recent warm vintages ensured that 2022 was not another 2003 – despite its extreme, hot, dry conditions. He warns that the frequently high pHs are a risk for the final hurdle – with an increased chance of volatile acidity and Brettanomyces, suggesting that although few samples showed these faults during the en primeur tastings, “it is certain that some producers will trip before the finish line this year”. Nevertheless, he is clearly impressed by the best wines – with eight potential 100-point scores in the mix. In a first, the work was divided between Kelley and Yohan Castaing, a relatively new member to the Wine Advocate team – so there are notes from both. The highlights noted below are 12 specifically recommended. Kelley’s highlights: Berliquet, Bourgneuf, Branaire-Ducru, Clos Manou, Dame de Montrose, De Retout, Domaine de l’A, Grand Village, Haut Marbuzet, Langoa Barton, Larrivet Haut-Brion, Mangot Read Kelley’s full report, notes and scores on the Wine Advocate GEORGIE HINDLE – DECANTER  Despite the year’s extreme conditions, Decanter’s Bordeaux correspondent Georgie Hindle writes that “a surprisingly large number of vineyards and their growers prevailed against the odds to create a wealth of exceptional wines in 2022”. She feels there are “both serious highs and lows”, but “some estates produced their best-ever bottles” – with “supple textures, excellent definition, long finishes and a sheer brightness and energy that has produced some of the most compelling wines I’ve ever tasted at this early stage”. She also emphasises how, despite being similarly hot, the year is not another 2003. For Hindle, the Margaux appellation was a highlight, as were the wines from the Haut-Médoc, as well as the top end of Saint-Emilion. She has pulled out a list of “coup de coeur" wines – those that were heart-stoppingly good, and it is those that feature as her highlights below. Hindle’s highlights: Beauséjour Duffau Lagarrosse, Canon, Cheval Blanc, Clos Fourtet, Figeac, Larcis-Ducasse, Laroque, Troplong Mondot, Les Carmes Haut-Brion, Smith Haut Lafitte, Brane-Cantenac, Giscours, Branaire-Ducru, Gruaud-Larose, Léoville-Las Cases, Pichon Comtesse, Montrose, Phélan Ségur, La Conseillante, La Fleur-Pétrus, Vieux Château Certan, Clos du Clocher, Pétrus Read Hindle’s full report, notes and scores on Decanter ANTONIO GALLONI – VINOUS  The first of the two Vinous reports comes from Antonio Galloni, who declares the best wines of the vintage to be “magnificent, viscerally thrilling wines” – “some of the most memorable young wines [he has] ever tasted” – although does temper this enthusiasm by saying that some selection is warranted. Running through the growing season, he highlights how “patience and technology” were critical – with larger numbers of smaller vats, allowing producers to harvest only what was perfectly ripe. The greatest surprise, of course, is the wines – not rich and opulent as for 2009 or 2018, but wines that “combine flavour intensity, energy and finesse in a way that I can only describe as magical”. He repeats the refrain that the wines bode well for Bordeaux’s fate in the face of climate change, and is clearly enchanted by the best wines. He flags that some of the wines are “a bit fragile” and that “élevage will make or break them”, not feeling it’s totally consistent below the top tier. He does, however, pull out a handful of over-performers, which we’ve listed as his highlights below. For him, the advancements in viticulture and winemaking are what define 2022 – wines of “notable depth and freshness without excess weight”, but exactly why they turned out the way they did remains something of a mystery. Galloni’s highlights: Alter Ego de Palmer, Beau-Séjour Bécot, Brane-Cantenac, Clos Puy Arnaud, Clos Saint-Julien, Figeac, Les Forts de Latour, Giscours, La Conseillante, La Gaffelière, Lafon-Rochet, Larcis-Ducasse, Léoville Las Cases, Le Pin Beausoleil, Les Carmes Haut-Brion, Malartic Lagravière, Moulin Saint-Georges, Puyblanquet, Quinault l’Enclos Read Galloni’s full report, notes and scores on Vinous JEB DUNNUCK  Jen Dunnuck is clear that the best 2022s are set to be “legendary”, with “brilliant wines from throughout the region”, but highlights that “there are dramatically different styles in the vintage” – emphasising that this is different to quality, which is “incredibly high”. The vintage is united by its “theme of ripeness and power”, yet yields, winemaking and terroir have all resulted in the aforementioned diversity. He finds the wines of the northern Médoc to be “powerful, concentrated, majestic wines showing remarkable purity and vibrance” and is fast to defend both the pH and alcohol levels, with the former sitting at or below the level of the 2020s and the alcohols “well within the normal ranges of 2009, 2010, 2015, 2018, 2019 and 2020, and very few 2022s show excessive alcohol”. He points to wines from the Right Bank’s limestone and deeper clay soils as “highlights of the vintage” – having retained “an incredible sense of freshness and purity while showing the inherent ripeness and power of the vintage”, although he finds Pomerol “slightly more erratic”. In his view, the satellite appellations have produced a “number of terrific wines” – with Castillon producing many “that rival the best from Saint-Emilion”. He compares the year to a blend of 2020 and 2018, or a mix of 2005 and 2010, with a little 2009 here and there. They are, he feels, “ripe, concentrated, sumptuous wines that have a real ‘wow’ factor”. Dunnuck’s highlights: Montrose, Mouton Rothschild, Haut-Bailly, La Conseillante, Larcis-Ducasse, Les Carmes Haut-Brion, Cos d’Estournel, Léoville Las Cases, Vieux Château Certan, Pétrus, Pichon Comtesse, Léoville Poyferré Read Dunnuck’s full report, notes and scores JANE ANSON – INSIDE BORDEAUX  Anson offered early coverage of the growing conditions and yields – ahead of tasting the wines – but her final reports don’t delve much into the detail of the year on its own, instead focusing on tasting notes and the methodology of her scoring. She is one of few critics to mainly offer firm scores rather than bands (apart from when there’s a chance of 100 points, which she doesn’t like to offer to unfinished wines), something she argues is most useful for those deciding on whether or not to buy. As her scores highlight (with five potential 100-pointers on the Right Bank, and two on the Left, but none for dry or sweet whites), she feels it’s a stronger year for reds than whites. She highlights the high levels of tannin and colour, as well as alcohols – noting that because of the latter she has erred on the side of caution with her drinking windows. She found the second wines stronger in the northern Médoc generally, and notes how producers used very different approaches to the vintage. On the Right Bank, she emphasises the advantage of being on Saint-Emilion’s limestone plateau, and that Pomerol offers “muscular swaggering style” this year. She pulls out a selection of wines as value buys, which we’ve listed as her highlights below. In her notes on early releases, Perrotti-Brown writes that 2022 was “a faith-affirming vintage for Bordeaux growers” – proving that the region could handle climate change. She highlights the surprising consistency from the year, as well as “a luminosity… that defies what we thought we knew about Bordeaux varieties”. With “its myriad of earthy, nuanced, soft-spoken, shimmery expressions”, it’s “a vintage that Bordeaux fans and serious collectors will want to seek out”. In her full report, released a week later, Perrotti-Brown declares 2022 “a classic, great Bordeaux vintage”. Echoing our findings, she notes that there are no rules in this vintage – picking dates varied significantly, and yet drastically different approaches resulted in excellent wines. She believes that a minority of wines (less than 10% of what she tasted) were acidified which is not in itself problematic, but where it has been done poorly, it shows. She also argues that the record-high percentages of press wine leads to a ruggedness to the tannin structure of some wines. Despite these two quibbles, she was “surprised by how consistent [she] found the wines from top to bottom”, in terms of quality – but she feels, like Galloni, that the heterogeneity of the vintage comes through in the style of the wines. Overall, however, she finds the wines fuller-bodied, high in tannin and quite high in alcohol, but with no dried-fruit character, instead showing impressive bright, red fruit and florals – even if the acidity is relatively low. Stand-out appellations are tricky, but she points to Saint-Emilion’s limestone plateau and areas off it, as well as parts of Castillon, Fronsac and Entre-Deux-Mers with similar bedrock. She writes: “There are many beautiful wines from the Right Bank and Pessac-Leognan, but the top wines of the Médoc are astonishingly great in 2022. If you love Cabernet Sauvignon, you may want to pay special attention to this vintage because the results, in some cases, are mind-blowing.” Perrotti-Brown highlights that the vintage allowed “properties on the peripheries of ‘great terroir’” to thrive this year – and she pulls out a list of estates falling in this category that are likely to offer good value in 2022, which we’ve featured as her highlights below. He argues that the anticipated vintage is subject to some fairly typical hyperbole. Although he emphasises that the vines seemed “in verdant rude health” prior to harvest, he’s not convinced that the heat and drought had no impact – as some producers, he suggest, argue. He references the increased use of press wine on the Left Bank, something he attributes to the influence of superstar consultant Eric Boissenot. As to the wines themselves, he seems reluctant to offer glowing praise, but writes that, “The crème de la crème is blessed with kaleidoscopic aromatics, intense fruit, finely-sculpted tannins, structure, elegance and length. Above all, contrary to what the growing season implied, they are suffused with freshness.” These are wines that “dazzle”. He feels however that – and contrary to others – that “terroir is not the be-all and end-all” but instead “a guiding hand” which results in “a partial flattening of the hierarchical pyramid”. Although he sings the praises of the best wines in 2022, he caveats this by saying some wines are “sweet ‘n’ sour”. This he attributes to “human error” and picking dates in particular, with the phenolic and sugar ripeness not always matching up. He feels that it was a season that demanded producers’ “A game”. He found Left and Right Bank are fairly equal in the year, but Saint-Julien was a particular standout. He finds the wines “unabashedly floral”, perfumed and black- rather than red-fruited. He highlights the powdered texture of the tannins in the vintage, as well as the unexpected freshness in the best wines. Most importantly, he emphasises that these are wines for long-term ageing. Think of a cocktail. Is vermouth in it? If you’re thinking of a classic cocktail, there’s every chance it is. The Martini, Negroni, Manhattan – I could go on. And on. For whatever reason, vermouth has not always received the recognition it deserves for propping up so many exquisite mixed drinks. In fact, I’d hazard that a fair amount of cocktail lovers don’t know vermouth is in their glass at all, or, if they do, their knowledge of the liquid might be a little patchy. When it comes to vermouth, there are a few things you need to know. Vermouth is an aromatised wine which hails from Torino, Italy. It is generally accepted that vermouth – as we know it, not the kind prescribed by Hippocrates in 400BC for ailments – was invented in the 16th century. In 2019, a Geographical Indication was introduced to protect the style and quality of vermouth from its birthplace, Turin. Under these regulations, vermouth must be made with at least one Italian wine, wormwood must be the predominant flavour and the wormwood used must be grown in Piedmont. The final liquid must also be between 16% and 22% alcohol in order for it to be labelled “Vermouth di Torino”. The two most common styles of vermouth are sweet and dry. The former is red in colour and as such is often called Rosso. This is the style used in your Manhattan and Negroni. Dry vermouth is white (Bianco) in colour and will be used in your classic Martini. Four classic Vermouth-based cocktails The Negroni It might be hard to believe given the Negroni’s current notoriety, but this simple serve of equal parts vermouth, Campari and gin was incredibly slow to catch on. As is often true in cocktail lore, there are a couple of people credited with its invention. The most widely accepted is a Count named Camillo Negroni who asked a bartender at Caffè Casoni in Florence to make his Americano cocktail a touch stronger. They duly obliged and switched the soda water for gin. This is believed to have taken place in 1919. A smaller camp credits a man named General Pascal Oliver Comte de Negroni with the invention of the cocktail in Senegal between 1855 and 1865. Setting aside the inventor for the moment, the Negroni, unrefutably, became de rigueur in the early 20th century – requested across Europe and favoured for its bitterness and alcoholic strength. Orson Welles was a very high-profile fan, famously quoted in 1947 for saying: “The bitters are excellent for your liver, the gin is bad for you. They balance each other.” In the years that followed, the Negroni’s popularity waned when appetites became more saccharine in nature. In the early 2000s, things shifted again as the Negroni began to appear on cocktail menus at some of the best bars in the world. It wasn’t long before the recipe featured in cocktail books and drinks sections of influential titles, such as The New York Times. Fast forward to today and the Negroni is regularly named the most popular cocktail by patrons and bartenders alike. There are countless riffs on the original recipe and an entire week is dedicated to celebrating it. How to make a Negroni 30ml sweet vermouth 30ml Campari 30ml gin Ice Slice of orange (garnish) Pour all ingredients into a glass with ice and stir well. Add garnish. The Manhattan The Manhattan has assumed many guises over the years, making its exact origin a hotly contested subject. Some believe Sir Winston Churchill’s mother was served the first Manhattan cocktail at the eponymous club in New York in the early 1880s. Others question the validity of this claim as she was likely in the UK, pregnant with the future Prime Minister, around this time. Some believe a New York bartender by the name of Black invented the recipe at the Hoffman House. The earliest known record of the Manhattan, in which this name and the recognised recipe, appear is in The Sunday Morning Herald in September 1882. Unhelpfully, some referred to a very similar recipe as a Jockey Club or Turf Club Cocktail. The classic recipe consists of Rye or Bourbon, sweet vermouth and bitters. During Prohibition, it was not uncommon for people to use a different whiskey as the base ingredient. If you substitute American whiskey for Scotch whisky, you have a Rob Roy cocktail. How to make a Manhattan 50ml Bourbon 25ml vermouth 3 dashes of orange bitters Cocktail cherry (garnish) Add all ingredients into a glass filled with ice and stir. Strain into coupe or Martini glass and garnish. The Americano The Americano recipe was invented at Gaspare Campari's bar in Milan in the 1860s. The cocktail of equal parts Campari, vermouth and soda water, was originally named “Milano-Torino” after the principle ingredients’ home towns of Milan and Torino respectively. The simple serve was renamed in honour of its growing fanbase: American tourists. The Negroni recipe was based on the Americano and contains two of the three main ingredients – with the soda water switched for gin. While many associate James Bond with the Vesper cocktail or a Martini – shaken, not stirred – the first cocktail associated with 007 in Ian Fleming’s work was actually an Americano in Casino Royale. It is later written, in A View To Kill, “Bond always had the same thing – an Americano”. How to make an Americano 30ml sweet vermouth 30ml Campari Soda water Slice of orange (garnish) Fill glass with ice, add Campari and sweet vermouth. Top with soda water and stir gently. Garnish. The Adonis A slightly less well-known vermouth-based cocktail, the Adonis was invented in honour of its Broadway musical namesake. The musical, based on William Gill’s novel, first opened in Chicago in 1884 and went on to become the longest-running show of its era. As the name suggests, the story follows a beautiful male statue who comes to life and ultimately opts to return to stone. The first reference to the Adonis cocktail was written in 1887.
