“The only thing more fun than drinking wine is buying wine,” says Allan Frischman, our new Vice President of Global Client Reserves, arching an eyebrow and laughing. He should know – he’s been working in the wine business since the early 1990s, with the vast majority of that spent sourcing, studying, authenticating and selling fine wine collections for a leading auction house. As of this month, he’ll be working to develop our network of reservists and their portfolios – allowing our clients to both sell and buy even more than before, giving us – and you – access to the world’s finest (and deepest) cellars. Beyond this, he’ll be finessing local pricing for each market we work in and helping manage clients’ wine storage – a job for which he is uniquely qualified. Frischman grew up in New Jersey and never planned to get into wine – but he took a part-time job at college (“to pay for beer”, he confesses) in a wine shop. The shop’s storage system was divided by country and region, with a warren-like basement that he needed to navigate, finding the right bin for new stocks. Reading about the different appellations, and using his staff discount to buy the odd bottle, got him interested – but it was a bottle of 1975 Ch. Talbot, tasted at Mary Ewing-Mulligan MW’s International Wine Center that hooked him: “At that point, I knew that this is what I wanted to do.”  The economics graduate was working at Manhattan’s Morell & Co. when, in 1994, the laws changed. For the first time since Prohibition, wine auctions were permitted to take place in New York State. “I didn’t know anything at all about auctions,” says Frischman – but it didn’t stop him jumping headfirst into something new, organising the state’s first commercial wine auction since 1920. “I didn’t know if we were going to get 10 bidders or 1,000,” he tells me. He shouldn’t have worried, for that auction was met with such enthusiasm that he walked away from the event on cloud nine, confident that he had found his calling.  In the 30 years since, he’s seen the auction business transformed. The 1994 law change created a new hub for wine’s secondary market, with New York rapidly becoming a rival for its traditional heartland in London – and the Big Apple rapidly added its own signature. Until then, auctions were staid affairs, dominated by trade buyers with little action beyond the raising of paddles in muted crowds – in Frischman’s words, “something dreary that dragged on for 10 hours”.  But Zachys – one of the auction houses that popped up in New York – added American flair, a touch of Broadway jazz hands to turn auctions into events, gathering bidders at round tables with great food and wine. Traditionalists said it wouldn’t work – but they were wrong. No longer were auctions purely a way to buy wine, they became fun – they became a place for wine lovers to gather, eat, drink and be seen. Higher attendance meant more bids, higher hammer prices – and more consignments that in turn brought more business, and a shift from trade to individuals.  The late 2000s brought challenges. “The Dow Jones was tumbling and it looked like the world was about to collapse,” Frischman tells me, looking back at the worldwide recession. “It was terrifying and of course people stopped buying wine.” But as Frischman rapidly learnt, people were waiting for the bottom of the market – and then they started buying again. At the same time, Hong Kong abolished import duty on wine (initially halved in 2007 and removed entirely in 2008) – and, like New York in 1994, instantly became a new centre for the wine trade. “The Asian market evolved almost over days,” remarks Frischman. “It became extremely sophisticated very quickly.” American auction houses started opening offices in Hong Kong. “For a few years, Hong Kong was just chewing up all the wine and the big hammer prices were all [there].”  The most recent shift in the world of auctioneering has been the advent of real-time, online bidding – one forced by the Covid-19 pandemic. “There was a perception that it would discourage people to show up in the sale room and would also discourage people from leaving bids in advance,” Frischman says, explaining why the industry was perhaps a little slow to embrace the online sphere. Interestingly, however, he anticipates that before online bidding was introduced, maybe only 10% of lots went to bidders physically in the room. With consumers stranded at home, and the technology already up to scratch, online auctions rocketed – and opened the market to an even broader range of consumers, with bidding wars between wine lovers in Brazil, Singapore, London, New York, Hong Kong and beyond now the norm.  As auction houses realised that online auctions worked, the need for events and associated spend dropped – and the auction style established by Zachys in the 1990s has become significantly less common. You might argue that this also heralds the end of the auctioneer – but even online companies have retained the compère, the familiar patter still something that bidders want.   It isn’t just where and how wine was selling, but which wines were selling that has evolved. In the mid-1990s and early 2000s, Frischman notes how the US market centred on Napa’s cult Cabernets, along with wines from the likes Williams Selyem, Ravenswood and, of course, Bordeaux’s top names. “[There was] across the board demand for Bordeaux,” Frischman tells me, “but you couldn’t give Burgundy away.” Of course, that’s all changed now – and Burgundy, despite its extremely limited supply, has become the darling of the fine wine scene. As prices have soared for the Côte d’Or’s top wines, wine lovers have started looking elsewhere, to Italy (Barolo, Barbaresco and some Brunello), Madeira (especially older vintages) and the Northern Rhône (Côte-Rôtie, Cornas and Saint-Joseph) – but none have the liquidity of Bordeaux. “They [the Bordelais] don’t get enough credit for the sheer, mind-boggling amount of great wine they’re able to put out every year,” says Frischman.  Over the years, Frischman has become an expert authenticator – the sort of knowledge that can only be gained by handling immense volumes of fine wine, working closely with producers and getting up close and personal with the rarest bottles. In 2006, he went to check over some wines that had been sent to the auction house he then worked for by a young Asian collector. The consignment was significant, worth millions of dollars – but even from across the room, Frischman knew that the wines didn’t look right. Closer inspection only confirmed that the wines looked like fakes – and the auction house turned them away, sending them back to the collector, then a new name on the scene, Rudy Kurniawan. A couple of years later, he got a call from the FBI’s Jim Wynn, asking if he would be an expert witness in a wine fraud case against Kurniawan, who had – by that point – become prolific. “I inspected, I don’t know, 40 bankers boxes of stuff that they’d gotten from his home, stamps for corks, fake labels, fake import strips – all kinds of stuff,” he says. In a warehouse in Queens, he studied the evidence – “going through bottle after bottle after bottle and writing a report about why I thought that they were fake”. It was – and still is – the biggest wine forgery case to have ever taken place, and Frischman, along with fellow authentication expert Michael Egan, was essential to proving Kurniawan’s guilt.  Wine authentication has become an essential component of wine collecting, and a key reason to work with trusted merchants. There are people who suggest that as much as 10% of wine on the secondary market is fake, but – in Frischman’s view, having handled fine wine for over 30 years – “That’s a substantial overestimate.” Despite such claims, forgery has only become more sophisticated, and it’s important, he says, to work with someone who knows what they’re looking at. “You want someone who is experienced to look at the bottle and who is empowered to say, ‘I don’t like it – we’re not offering it.’” There’s a big difference, he explains, between being convinced something is fake, and being convinced something is real – and you always want the person checking wines you’re buying to be in the latter camp.  The wine business is a people business – and he’s been lucky to spend three decades getting to know the world’s foremost collectors, spending time rustling through cellars, lugging his fair share of cases in and out of vans, and cradling bottles of elusive vintages and cuvées. Beyond this privilege, he’s often found himself on the receiving end of collectors’ generosity – recognising a fellow enthusiast’s passion. When I ask him if there’s a bottle that stands out, beyond the 1975 Talbot that was his hook into the industry, his eyes mist over. It was, he tells me, on a trip to Tokyo, at a remarkable dinner that included some incredible wines, including the fabled 1947 Cheval Blanc. But it was a bottle of 1978 La Romanée-Conti from Domaine de la Romanée-Conti that stole the show: it was “breathtaking, magical”, he says. “I was practically brought to tears.” Until that moment, he’d never necessarily understood why collectors kept this prized cuvée, and didn’t sell it to fund their La Tâche or Romanée-Saint-Vivant – but this bottle made him realise just why people don’t. “This wine was perfect,” he says.  It’s easy, perhaps, to imagine the auctioneering world is over-run with wine investors, but that’s far from what Frischman has found. “The vast majority, regardless of what they say they’re doing, are buying to drink,” he says. On paper, that may not make sense – after all, who needs 30,000 bottles of wine? But that, as Frischman and any wine obsessive knows, is the collector’s mentality – and, deciding to sell, despite owning more wine than could possibly be consumed in a lifetime, is much harder than buying another case or 10.  When Frischman first started auctioning wine, he recalls talking to his father, who wondered if there was enough fine wine to sustain a career. The beauty, Frischman, now knows, is that there’s a new vintage every year – beyond that, and as he’s seen over the past 30 years, the wine world is constantly shifting, with an ever-expanding range of regions and producers. And he’s evolving with the industry, making a move of his own and bringing his expertise to FINE+RARE. We can’t wait to see what he’ll do. Percarlo and La Ricolma are two of Italy’s finest wines – both crafted by Luca Martini di Cigala at San Giusto a Rentennano. Percarlo is the Tuscan estate’s top Sangiovese bottling, made with the most concentrated and best fruit, picked in a third and final pass through their vines (with the previous passes used for the estate’s Chianti Classico and Chianti Classico Riserva). When Martini di Cigala first made the wine in 1983, however, it was illegal for Chianti Classico to be 100% Sangiovese, so he had no choice but to declassify the wine to an IGT. Although the rules have since changed, Percarlo’s reputation precedes that of the Chianti Classico denomination and remains an IGT.  La Ricolma is 100% Merlot – a variety with a very different temperament to Sangiovese. The fruit for this wine is picked all in one go; the secret to finding balance in Merlot, the Martini di Cigala says, is to slow its ripening – a challenge that must be tackled throughout the season.   The result is two completely different wines from two different varieties grown on the same estate in Gaiole – Chianti Classico’s southernmost district.  Last Thursday, we hosted a special dinner pitting these two legendary wines against each other. Luca Martini di Cigala returned to London for the first time in over 30 years, with his wife Bettina, to present some of the estate’s finest bottlings, with vintages back to 1998. Tasting these wines at full maturity was a privilege, made all the more special by the fact they were all served from magnum – and came from Martini di Cigala’s personal cellar. With so few magnums produced, many of the wines on show had never been commercially available – the large formats reserved for the family’s private consumption.   Martini di Cigala selected a range of vintages that he felt were in their sweet-spot and included the 2007, 2006, 2005 and 2004 of both Percarlo and La Ricolma – followed by a rare 1998 Percarlo. The wines were extraordinary.   Having been fortunate enough to have tasted the 2018 La Ricoma and Percarlo earlier in the day – which were stunning in their youth – it is mind-blowing to see how these wines develop with 15 years or more in bottle. With age, the purity of fruit found in the younger vintages takes on hedonistic, richer aromas that set the drinker’s pulse racing.   The aromatic appeal of La Ricolma is about as beguiling as wine gets and the 2007 (in what Cigala describes as a hot vintage) was arguably the wine of the night. It just shows how resilient Merlot is in San Giusto’s vineyards. A grape often seen as too alcoholic and overpowering in hot vintages, in the right place it produces a wine of outstanding purity. While having all the opulence the finest Merlots can muster (which is not dissimilar to Pétrus), the balance is impeccable. Tasting 2007 Percarlo alongside 2007 La Ricolma was a fascinating comparison – something that rang true throughout the vertical we tasted. Where the Ricolma was more exuberant, Percarlo was more austere, although this seems too stern a word, such is the wine’s finesse. The Percarlo certainly seems more vertical – yet it is one of the smoothest and most rounded Sangioveses you are ever likely to taste.   Martini di Cigala notes that the San Giusto vineyards are not that high in altitude compared to his neighbours at Castello di Ama. This means that during the day his vineyards are as hot as those in the more southerly, warmer Montalcino; the difference is that San Giusto has much cooler temperatures at night, allowing the fruit to retain vibrancy and cooler fruit tones – something that shone through in all the wines tasted.  Martini di Cigala is one of the most modest winemakers I have ever met. Asked what his secret is, he says he has none. But, as he talks about his wines, the terroir – and his amazing memory of weather episodes decades ago –  he clearly has an exhaustive understanding of his craft. It was a delight therefore to see him become so animated when the 2006 Percarlo was poured. Tasting the wine, he professed to the guests, with a big smile on his face, that this was one of the finest Percarlos he has ever made – this was the wine he always wanted to make. He recalls the harvest and said, “These were the best grapes I had seen in my life.” It was a joy to taste this wine 16 years on with its deservedly proud maker.  The 2005 vintage, noted Martini di Cigala, was a vintage full of expectation. Vignerons were very excited about the wines’ prospects, but then the vineyards were hit by wet weather during harvest. Despite this, the 2005 Percarlo and La Ricoma are magical. While they don’t have the concentration of the 2007 and 2006, they still capture the San Giusto magic. In my 2005 La Ricolma tasting note, it says “otherworldly” – so it must have been pretty special.  The 2004 La Ricolma is particularly elegant. The nose is again extraordinary – the palate texturally sublime and the wine has impeccable balance. The 2004 Percarlo is, as Martini di Cigala noted, “a particularly elegant vintage for Sangiovese”.  The wine has fantastic clarity to the fruit, mouthwateringly juicy but with amazing structure too. The tannins are just so fine – it is incredible. Just 18 magnums of the 2005 and 2004 La Ricolma were ever made – so it was a real privilege to have them at the tasting and for them to be showing so well.  After comparing the four vintages Martini di Cigala felt the 2005 and 2004 have reached optimum maturity, having fully opened and reached their peak. The 2006 and 2007 on the other hand, “still have a certain amount of coiled spring energy to the wine – they still have more to give”.  We begged Martini di Cigala to bring a very rare 1998 Percarlo from his cellar – providing a particularly grand finale. At nearly 25 years of age, the wine was magnificent. It captures all the character that runs through the previous vintages of Percarlo – with incredibly refined tannins, vibrant acidity and classic Sangiovese structure, while also being so smooth and rounded. Even with age, the structure was solid and had matured beautifully.  Looking back at the wines, it is the Tuscan terroir that clearly defines these two wines. La Ricolma has the opulence and complexity of Pomerol but with that austere edge, that vibrancy and verticality that you only get from Tuscan soils. In comparison, the Percarlo has the vibrancy and Tuscan verticality, but there is no astringent edge – such is the finesse of the tannins. Some preferred Percarlo’s more classic Italian acerbity, while others loved the uniqueness and profundity of La Ricolma. Tasting them side by side was such a joy, the wines offering two very different varietal expressions while also sharing a similarity of place. These wines – even the Merlot – just couldn’t be from anywhere but Tuscany.  It's fitting that Alessandro Masnaghetti – the man who created the groundbreaking viticultural maps of Barolo and Barbaresco – has just published his new book, mapping the terroirs of Chianti Classico. It’s a book Luca Martini di Cigala is immensely proud of, having championed the differences in sub-zones for decades; now he has the proof – and he brought a copy for both us and the River Café’s Ruth Rogers. Her late business partner and co-founder of the London institution, Rose Gray visited San Giusto many years ago – it was fitting for Martini di Cigala to be able to repay the favour for this special evening.  While the tasting might have been billed as Percarlo versus La Ricolma, it was a friendly battle. It was great to see them both showing so well and how complementary they were tasted side by side. One of the most notable takeaways from the evening was the outstanding consistency. Every wine on the table sang. Every wine was impeccably balanced. Every wine was full of character and complexity. It was a special, rare opportunity that will live long in the memory. Tasting La Ricolma versus Percarlo: a special Super Tuscan vertical

Few wine regions have seen a transformation as significant as Tuscany has over the last 15 years. These days the region regularly produces some of the finest wines found anywhere on the planet, while retaining a distinct sense of place.  Tuscany is the only region in the world to have truly tamed Sangiovese, with nowhere else able to grow this fussy grape variety and produce wines of the same level. At the same time, Tuscany has managed to produce some of the world’s finest renditions of the better-travelled international varieties such as Cabernet Sauvignon and Merlot; even Pinot Noir and Chardonnay are finding a foothold in this magical enclave of central Italy. Few have been as influential in this transformative journey than San Guisto a Rentennano’s Luca Martini di Cigala, who has managed to produce not one but two of the region’s most iconic wines – Percarlo (100% Sangiovese) and La Ricolma (100% Merlot). In his typically modest manner, however, he does not believe great wines are made by great winemakers – but by understanding where a vigneron must focus their attention in the vineyard. According to Martini di Cigala, winemaking can improve the quality of a wine by no more than 10%. “Great wine, however, is made with great fruit,” he says. So what is it about Tuscany that has resulted in the region’s recent renaissance? For Martini di Cigala, it has been understanding how the region’s unique soils and climate, if allowed, can produce wines where the character of the terroir prevales, rather than the varietal. “When it is the opposite and the varietal character is more evident than the character of the place, of the area, of the soil,” says Cigale, “to me it doesn’t make much sense.” It is the vineyard that must do the talking, not the grape variety, nor the winemaking. While the Tuscan wine renaissance began in the late 1970s and early ’80s, the meteoric rise of the region was far from linear. Among the new wave of pioneers, there was naivety too and, understandably, external influences started to impact how wine was being made. Back then, San Giusto A Rentennano didn’t have their own personal brand, and were selling wine to the big wineries like Antinori and Ruffino.  Following in the footsteps of the likes of Fontodi, Isole e Elena and Montevertini they decided to focus on improving the quality of their Sangiovese – which began, fundamentally, by reducing the yields in the vineyard. “Before that, we used to produce a good Chianti,” says Martini di Cigala, “a simple wine.” But, with these changes, “The stye completely changed and we began to focus on making wines for long ageing.” As the movement progressed, however, he began to sense a period of self-doubt looming. “Compared to today, where there is a big improvement in the culture of tasting wines and recognising the character of the different varieties,” he says, “people were used to drinking rounder, softer wines. And Sangiovese [made at lower yields] can be so aggressive, so hard with the tannins – especially when young. It was a problem.” At the time, many of the vignerons felt that in order to increase the wine’s ageing potential, the wines needed to be darker and more concentrated, while also exposing the wine to plenty of new oak and more oxygen – opting for smaller 225-litre barrels (barriques) rather than the region’s traditional larger casks. You could see the commercial attraction too, since this approach softened Sangiovese’s tannins. Emerging regions like Tuscany were all looking towards more established fine wine regions for inspiration. The use of new barriques was fashionable around the world but, most notably, part of the Bordeaux recipe of the time. Twenty years ago, Martini di Cigala believes, they wrongly followed these trends, producing intense, overripe, over-oaked wines. “It was a mistake because many wineries didn’t keep the character of the Sangiovese – either due to excessive use of wood, which does not integrate well with Sangiovese, or because it was blended with other varieties to build the wine’s intensity, while softening its aggressive nature.” For Martini di Cigala, even his Merlot plantings weren’t performing well – despite being a variety better suited to the current trends, with better resistance to new oak’s influence. The current recipe was not working for him – or for Tuscany. Early in its renaissance, the region began to stumble. Martini di Cigala’s success came when he realised that, despite sharing the same vineyards, his Merlot and Sangiovese had very little in common. To produce anything better than ordinary, he had to start treating the two varieties completely differently and let the vines do the talking. Sangiovese is a frustratingly fickle variety. It has the potential to produce wines as ethereal as the finest Pinot Noir and as rich and elegant as fine Bordeaux. Yet it has failed to make any real imprint outside Italy and, even today in Tuscany, it remains maddeningly inconsistent. “Compared to other varieties like Merlot, Cabernet Sauvignon and Syrah,” he says, “these varieties can produce wine everywhere. With Sangiovese it is hard because it needs calcareous soil in order to produce the right balance of tannins. In any other kinds of soil, it either increases acidity too much or the opposite, making the wine very flat. To produce a wine with a precise character with a lot of tannin but at the same time integrated with the fruit, Sangiovese needs calcareous soil.” But, he stresses, it is not only the soil but the climate that is important too. “It is difficult to have great Sangiovese that is very, very light, low in alcohol and low in polyphenols [tannins]. The wine must be rich,” he says. The region must be hot. The elegance and the precision, however, come from another distinct attribute of the hillsides of Tuscany: cool night-time temperatures. This, Martini di Cigala believes, is vital for the elegance of the wines – and something that can be lost in warmer vintages. “Sangiovese is very delicate, if there is too much concentration, the level of tannins risk damaging the wine’s natural elegance and the balance,” says Cigala. For me it is a great wine when the wine doesn’t need to show muscle. It is not important to be extremely concentrated or to have a lot of colour for a great vintage. It is more about the balance of the different factors.” He notes that some of the most celebrated vintages aren’t necessarily the longest-lived, highlighting that the cooler 2013 and 2014 vintages will outlive the much applauded, warmer 2015s – although he insists 2016 has proved to be spectacular. Percarlo evolved as Martini di Cigala gradually understood Sangiovese’s sensitivities. Up until 2008, Percarlo was aged 100% in barriques. First produced in 1983, the amount of new wood has been reduced over the years. Today he doesn’t use any barriques at all for Percarlo, or for any of his other Sangiovese wines (Chianti Classico and Riserva). He believes Sangiovese is too sensitive to oxygen to age in smaller barriques. Today it is matured 50/50 in large 5,000-litre and 3,000-litre barrels. Martini di Cigala didn’t start producing Merlot until 1993, but for the first 10 years, he managed the vines similarly to his Sangiovese – with mixed results. “Sometimes the vintage would be very Tuscan in style and then the opposite in other vintages – the aromas were more like Merlot from north Italy with more pepper on the nose. I was never convinced with the results,” he says. The Merlot in Chianti Classico is also very different to the Merlot grown on the Tuscan coast of Bolgheri. The bigger diurnal temperature shifts in the Tuscan hills produce Merlot with more acidity. The wines are, in Martini di Cigala’s words, “more vertical”. The real success of both Percarlo and La Ricolma, Martini di Cigala believes, lies in the bespoke adaptations he started to make in the vineyard for each variety. Sangiovese really benefits from an early green harvest in July – reducing the natural yield. Merlot, on the other hand, proves to be a disaster if you do the same thing and limit your yields so early in the growing season – causing a spike in sugar production at the expense of tannin development.  Martini di Cigala also painstakingly picks the Sangiovese destined for his Percarlo bunch by bunch, assessing each vine individually. Picking Merlot bunch by bunch, in contrast, makes no sense – “it is far too irregular”. While Sangiovese yields can be manipulated throughout véraison to its benefit, Merlot needs to be left alone. “The key for Merlot”, he says, “is to try to slow down its ripening. If the variety doesn’t have a long growing cycle, the wine remains short.” Over the years Martini di Cigala has moved his Merlot vines to the coolest parts of his vineyards. He admits his original La Ricolma Merlot plot is his worst, its west-facing exposition making it too warm. He much prefers his plots closer to the river where temperatures are lower. But the key viticultural work for both his Merlot and Sangiovese starts earlier – he is keen to point out that there is no recipe each year, the cultivation has to be very precise depending on the vines’ needs. “You have to be a good interpreter of the season. Often you don’t notice the stress in the vineyard until July, by which time it is too late. You have to follow the trends of the weather earlier – this is the most difficult point of our job and has become especially true in the last few hotter years.” Each viticultural step has to follow the trend of the season. That, for him, is the key. Over nearly 40 years Martini di Cigala has continued to make tweaks in the vineyards, further improving the wines. Up until 2004 he used to select the Percarlo grapes only from certain parts of the vineyard, but now the fruit is picked bunch by bunch – another fundamental reason, he believes, the wines’ quality has escalated. Martini di Cigala has proven that wines made from Sangiovese and Merlot can be both bold and beautiful, aligning the Tuscan hills’ unique climate with precision viticulture. The hot summers and cool night-time temperatures matched with the calcareous soils are the perfect combination for Sangiovese and are testament to Merlot’s adaptability. After a period of self-doubt and mixed results for the region, the Tuscan renaissance today has well and truly found its foothold and is on an extraordinary run. And it is Percarlo and La Ricolma leading the pack. “If you asked me to name 15 great wineries in Chianti Classico 20 years ago, I would be in trouble,” says Martini di Cigala. “Today I could arrive at 50 or 60.” What has changed most today, according to the winemaker, is a paradigm shift in focus from winery to vineyard. While he is a little disappointed more of them haven’t turned to organic farming (of which he is a longstanding proponent), he believes the change has been very positive. A noble name, a castle, or a famous winemaker today no longer makes the headlines in Tuscany. It is precision viticulture that has taken these distinct wines from the Tuscan hills to the top of many collectors’ wish lists. Luca Martini di Cigala, the man behind Percarlo and La Ricolma, is one of Tuscany’s viticultural pioneers. We spoke to the San Giusto a Rentennano winemaker about his role in the region’s renaissance and how he turned to the vineyard to reveal his wines’ true potential

It’s no secret that Scotch whisky is dominated by two giants – Diageo and Pernod Ricard, who represent 60% of the market, with three other big players taking the next 20%. That leaves a mere 20% for those who have the wallets and mettle to fight over the rest – but that’s an increasing number of people. There are currently over 30 single malt distilleries at some stage of opening.  “I think it’s a bit of a worry to be honest,” Mark Reynier, Renegade Spirits founder and CEO, says. Reynier has been behind three of the most talked-about distillery projects in the past 20 years – the resurrection of Islay powerhouse Bruichladdich in 2000, the renovation of a former Diageo brewery into Irish single malt distillery Waterford in 2015 and the construction of Renegade rum distillery in Grenada from scratch in 2020. All three have a dogged focus on terroir and have not been without their struggles. “Superficially it does look easy - but it sure as hell isn’t,” he says. “With Bruichladdich we almost went bust twice. With the best will in the world and two-distillery experience I got it wrong with Renegade and almost went bust last September.”  In Reynier’s view, many of those opening distilleries are driven by romantic ideas and the desire to make a quick buck – from landowners looking to monetise estates to “crooks” who “promise fortunes to be made”. Few, however, have the knowledge, business nous or money to back up their ambitions.  Wolfcraig – a new distillery in Stirling – is one of the industry’s most interesting projects, largely thanks to the experience of the team involved. While neither of the founders Jamie Lunn or John Moore had worked in whisky before (coming, respectively, from construction and finance), Jamie Lunn’s father is former Whyte & Mackay chairman and chief executive Michael Lunn – and happened to be eager for a new project. It hasn’t been plain sailing though: the team had a false start with an ill-fated attempt to take a controlling stake of an existing distillery. Downhearted but not defeated, they made the decision to go it alone. Moore and Lunn have assembled a first-rate team with over 200 years’ experience. Master Blender Richard Paterson OBE was the most recent addition to the roster – which Jamie Lunn affectionately refers to as “the Harlem globetrotters of whisky” – including Dr Alan Rutherford OBE (former Production Director at Diageo, Master of the Quaich and previous President of the Malt Distillers Association of Scotland), Ian Macmillan (a Master Distiller, also a Master of the Quaich and a member of the Worshipful Company of Distillers) and Iain Lochhead (former UK Bacardi Operations Director, and another Master of the Quaich). But even with a team of such pedigree, it hasn’t been easy. “It was three and a half years of pain,” Moore says. Every decision has been driven by an unwavering mission to produce a truly special liquid, considerable industry experience and business acumen. Stirling, for example, was chosen not just for its infrastructure, but its accessibility – within an hour’s drive of 70% of the Scottish population. The team ensured they were fully funded and have consciously built a brand – and decided on the style of spirit they’ll be making – before physically breaking ground. “Out of all the new whisky distilleries,” Moore says, “very few of them are designing their own unique spirit and they have not put any thought into why they have a particular shape of still.” Wolfcraig, by contrast, is having their still handmade by Forsyths, with a distinctive double-ball design to produce a more muscular, full-bodied spirit. It’s not just new players and mavericks behind the trend though, with some of whisky’s most historic names being given a new lease of life. Halewood International, for example, is bringing malt whisky distilling back to the heart of the Scottish drinks industry in the Port of Leith, Edinburgh, for the first time in 100 years with the John Crabbie Distillery.  Today, the name John Crabbie might be synonymous with ginger wine, but he was an independent bottler, single malt producer and recognised blender in the 19th century. For the team here, creating something new brings great freedom. “One of the key parts of our distillery is its versatility,” Global Dark Spirits Manager Andy Wallace says. “Because of the type of distillery we have, we can change our new make spirit and we can be very adaptable. That flexibility, put in the hands of somebody who knows what they are doing, like our Master Blender Dr Kirstie McCallum – a chemist with an excellent palate – and we’re going to experiment.”   Experimentation with different casks is high on the agenda. In addition to PX and Oloroso casks, the team is looking at how Manzanilla might work and playing around with other wine cask finishes.   Prior to joining Halewood, Wallace spent six years at William Grant & Sons, the home of Balvenie and Glenfiddich since 1887. “They are beautiful, incredible distilleries in a beautiful part of the world,” Wallace says, “but they come with their own inherent limitations… some people will see them as being a bit aspirational and not for them.” In his view, building something from scratch – even with a history like Crabbie’s – means they don’t have to produce a certain type of product. “What we want to do is bring new people into the category and allow people to drink differently,” he explains. Free from the burden of a legacy, a new distillery can be more agile. This can, however, be a catch-22. In a quest to stand apart, rather than play the old boys at their centuries-perfected game, innovation – if not managed in a considered, well-financed, way – can end in tears. “A lot of people have got rather carried away with the romance and [they] don’t really understand the consequences and the costs, and the durability that you need,” Mark Reynier explains.  “And above all you need a unique proposition. Just to be another distillery isn’t enough. The distilling bit is the easy bit. I think this is what’s going to be the downfall for a lot of people. The maturation and the time and cost is the crunch. And then you have got to bring it to market.” Wallace agrees. “You must have a long-term plan for selling your product because you have got a several-year timeline before you can launch anything in the first place,” he says. “One of the big challenges for whisky companies is predicting demand. If you have to predict how much 12-year-old product you’re going to sell on day one, that is a really difficult challenge.”   This was one of the many reasons Wolfcraig was determined to be fully funded from the get-go. “A lot of new whisky distilleries are just living hand-to-mouth and raising money year-on-year and that is emotionally draining,” Moore says. “But, also more importantly, it takes time away from the business when you are constantly fundraising.” It’s no small amount of money required, either. While you might be able to start a gin distillery with £50,000, whisky is a different beast. “Even the small craft distilleries, you’re talking several million pounds to set up,” Moore explains. “Our overall investment will be close on £20million… So, it’s not something you go into lightly.” “Running a distillery is an expensive business,” Reynier adds. “Just when you most need the revenue to get into the market, that is when you are least likely to have it. You are building in a lag period. You have created this brand over a decade, but you don’t actually have enough stock maturing to satisfy the sales that you have created or are creating. So, you have got to plan forward.” Waterford is a distillation of everything Reynier got wrong at Bruichladdich and everything he felt he wasn’t able to do because of a “lack of resource, lack of desire perhaps, tradition getting in the way, and the lack of logistics”. “We had a war chest because we knew that to do it properly, we had to be able to insulate ourselves financially to be able to buy ourselves the time to do it properly, with proper, premium-quality barley, single-farm distillations for uniqueness and for complexity,” Reynier explains. “Practised at Bruichladdich, perfected here.” Ultimately, once you get past the business and branding, it’s the quality of the liquid that will sort the wheat from the chaff. “We need to achieve the same core things any distillery does,” Wallace says. “We want to make genuinely brilliant drams that people will enjoy in years to come.” Browse all Scotch whisky or read more Editorial 

As demand for single malt whisky continues to soar, the number of distilleries – big and small – preparing to fling open their doors increases at a bullish rate. Holly Motion talks to a few of the industry’s newest names to see if everything is as rosy as it seems

The Pont des Arts project was created by Thibault Pontallier (son of Paul Pontallier, the celebrated winemaker of Château Margaux from 1983 to 2015) and Arthur de Villepin, an art curator from Paris. Both Thibault and Arthur come from high-profile backgrounds, with Arthur the son of the former French Prime Minister Dominique de Villepin. Growing up in such a prestigious and privileged environment introduced them both to the world’s most exciting artists, as well as the world’s most successful winemakers. It was this immersion in both the world of fine art and fine wine that spawned the Pont des Arts project.  “My family has been making wine for more than 500 years, and since I was a kid I have always considered winemakers to be amazing artists who are able to transform and sublimate nature into something truly special and emotional,” says Thibault. “My father used to say, ’A good wine gives you pleasure, but a great wine can give you emotion‘, and it is exactly the same for a great music, movie or painting.” Pont des Arts is very much a project to combine these two cultural worlds, producing wines made – and inspired – by artists. “A certain painting will be able to show and express the depth, the power or the finesse of a subject,” explains Thibault, “and wines can do the same thing. It is the perfect metaphor to understand the magic behind a wine.”   The project aims to position the wine as a bespoke creation. Each winemaker involved in the project has produced a wine distinct from their “normal” range, bottled exclusively for Pont des Arts.  It is then down to Thibault and Arthur to identify how the wine resonates with an artist’s work. “Arthur and I went to the artists’ ateliers, and met with the winemakers for each collection, carefully thinking about the association between each painting and each wine, and to ensure the emotions that are evoked when drinking great wine or looking at great art are intrinsically linked.”  The first collection of wines was curated in 2010 and was in fact a collaboration with Thibault and his father Paul Pontallier. They both travelled throughout France to find inspiration from their many winemaking friends around the country. “My father, a few good winemaking friends and I looked for months for the best terroirs and the best grapes, tasting more than 700 different parcels in France to realise this unique project.” The selection process for them was clear from the outset. For each wine they were looking for three main attributes: “Each wine must have a very special perfume, epitomising each appellation, a huge power hidden by elegance, and a fresh lingering finish.”   Following the success of the initial releases, their collaborations with winemakers grew. They started to work with more vignerons who shared their philosophy and whom they wanted to work with. Etienne de Montille, Rodolphe Péters (of Pierre Péters), Château la Conseillante and Nicole Rolet (of Chêne Bleu) have all made special cuvées for them. “The most important thing is that behind each collaboration is a beautiful friendship, a shared vision, love of wine and trust. We work very closely with each winemaker for every collection. Making sure everyone is part of the process and that the art and the wine complement each other perfectly,” says Thibault. “The wines themselves are works of art, so we spend a lot of time deciding on each new creation.”  The success of the project has seen winemakers entrust Pont des Arts with some very special cuvées. Giving the team amazing access to some rare Premier and Grand Cru wines from some of France’s most celebrated terroirs. With such quality the volume unsurprisingly remains very small, each cuvée exceptionally rare and becoming harder to find, “Exactly like the great pieces of art we work with,” explains Thibault. “What I love with this project is to see the excitement of the winemakers we work with, because they can create something unique and different for Pont des Arts, something different from what they were doing in the past. Our aim is to give them freedom and allow the creativity to create something unique and special.”  Perhaps Pont des Arts’s access to some of the world’s finest winemakers and terroirs is not such a surprise given the reputation of Paul Pontallier. Securing artists for the project seems more difficult, particularly with such famous artists as Piet Mondrian. While some of the artists – such as the Spain’s Miguel Barceló and French Chinse Artist Zao Wou-Ki were long-term friends of the Villepin family, for artists like Piet Mondrian, Thibault and Arthur were in touch with the estate throughout the whole process (design, production, labels etc). “They were very happy to help us develop this collection as they liked the initiative behind Pont des Arts.” Thibault is keen to convey “a message with authenticity and passion,” he tells me. “I guess the people we are collaborating with can sense that, which makes everything much easier.”  The Pont des Arts project continues to expand with some of the world’s most exciting contemporary artists and winemakers lining up to take part in new collaborations. One of the latest releases to come from Pont des Arts is a Grand Cru Blanc de Blancs from renowned winemaker Rodolphe Péters of Champagne Pierre Péters with artwork by Miquel Barceló on the label. Politicians don’t always follow through on their promises but US President Franklin D. Roosevelt made good on one of his 1932 election pledges: repealing Prohibition just weeks before the start of 1934. After nearly 14 dry years, producing and drinking alcohol was once again legalised and revellers could happily toast the New Year.  For Californian winemakers, however, there was still little to celebrate. What had been a fledgling wine industry before 1920 had been left in tatters, the number of Napa wineries falling from 120 to less than a third of that. A long, bumpy road to Cabernet greatness was barely conceivable for those remaining with so-called Burgundy, Chablis and Claret making the running.  However, there were some bright notes. The region’s pioneer, Robert Mondavi, arrived in the Valley in 1936 and said that he was "tremendously impressed by what I called the big four of the California wine industry . . . Inglenook, B.V. [Beaulieu Vineyard], Beringer Brothers, and Larkmead" and allegedly bowed his head when he drove past the first two. It would be another 50 years before Bill Harlan bought his 240-acre property that became Harlan Estate, which would go on to craft the “single most profound red wine made not just in California, but the world” according to Robert Parker.  On the other side of the Atlantic, there was little to smile about in the 1930s either. France –and the world’s finest vineyards encountered the same malaise as the world’s economy but 1934 provided the one bright spot. Admittedly, the vintage didn’t quite produce the fireworks of 1928 or 1929, but it would be more than a decade until there was anything to match the 1934 vintage.   Among the recipients of a bountiful harvest was Burgundy. The late Henri Jayer –the man who converted an artichoke patch in Vosne-Romanée to the esteemed Cros Parantoux vineyard–said,“In Burgundy, it is a rare occurrence to see quantity happily associated with quality, as in 1999, 1959 and 1934.” Amid a depression, though, it wasn’t enough to simply make great wine; you had to sell it. In an effort to breathe life into the market, a fraternity known as the Confrérie des Chevaliers du Tastevin was established. Its founders declared “If our cellars are full, we must invite our friends to help us empty them.” Their evenings of Pinot-swilling bonhomie brought some cheer before they were brought to a halt by the onset of war in 1939. With little appetite for parties in the mid-thirties, long-term vision was required for the Champenois, too. The powers that be at Moët & Chandon stepped up to the plate, designating what was an excellent year for the region as only the third-ever vintage of its super luxury cuvée Dom Pérignon. The wine wouldn’t see the light of day until 1951, when the president of France, foreign kings and the future Pope Jean Paul XXIII saw off several of the 1,200 cases at various events.  It wasn’t just eastern France that enjoyed a break from the string of dismal vintages. A prodigious harvest in Bordeaux produced some muscular wines destined for the long haul. Their longevity remains evident to this day, particularly in magnum, and has been a pivotal vintage for Neal Martin, imbuing him with greater respect for Saint-Émilion property Cheval Blanc.  “The vintage that alerted me to the pedigree of Cheval Blanc’s old vintages is not the legendary 1947 nor the fabled 1921, but the 1934,” he explained in 2019. “This was several years after Albert Laussac Fourcaud passed away, having created a société civile between his children to ensure that the property would remain in his family. First poured at a remarkable tasting in London themed around that vintage, the 1934 Cheval Blanc lit up the evening”. The world might have changed in the last eight decades but some things, it seems, can be counted on to remain the same. Read more Editorial
