The four-wheel drive pulls up and we pile out – Marco Pallanti’s two Jack Russells (Bach and Masetto) leading the charge as they tumble down and into the vineyard in front of us. The vines stretch down a steep slope, three triangular slithers slanting severely to a point, forming a natural amphitheatre, and Siena’s iconic tower just visible on the horizon, 20km to the south. CEO Lorenza Sebasti, her and Pallanti’s son Arturo, our Buying Director Corentin Margier and I are standing in Castello di Ama’s Montebuoni vineyard, which gives its name to their Riserva bottling. It’s the final stop in our tour of the various sites that make up the property’s 75 hectares of vines.  Just tasting Castello di Ama’s wines tells you that this is a special place, but of course there is no substitute for getting your feet on the ground, walking the vines and seeing the site yourself. Since four Roman families re-discovered this hilltop site in the 1970s, it has been lovingly restored, with significant investment in the vineyards and winery – and the original 55-hectare estate has grown to 115 hectares today (with 75 hectares of vines and 40 of olive groves), not to mention the extensive art collection that dots the property.  The vineyards are spread across four valleys, with each site within a 1.5-kilometre radius of the winery in Gaiole-in-Chianti. For winemaker Pallanti, this proximity is one of the keys to quality, not only allowing them to really understand each site, but also ensuring there is minimal time between picking fruit and getting it into the winery. For each parcel, they aim to have the fruit in the tank in under two hours. The property all sits between 420 and 530 metres above sea-level, on the higher side for the region and another defining element for Castello di Ama, lending their wines great freshness and finesse.  The northern flank of the estate is the 16.1-hectare La Casuccia, dominated by stony clay soils and surrounded by stone walls. Here the “rich, fat soil” (as described by Arturo Pallanti) is home to largely Sangiovese, with one historical parcel of Merlot. The tenderloin of the property, it produces opulent and expressive wines, and a single-vineyard Gran Selezione is made in only top vintages (as for Bellavista).  Moving south you come to San Lorenzo which forms the foundation of the eponymous Gran Selezione, a wine made every vintage. While the vintages from 1982 to 1990 were made exclusively with fruit from this vineyard, it has evolved to become a blend of plots – including fruit from Bellavista and La Casuccia in particular in the years they aren’t made. The soils here are chalky yet with plenty of clay-rich schist – a site that doesn’t have the extremes of Montebuoni, Bellavista or La Casuccia, but brings together some of the best characters of them all in its 16.5 hectares.  Sandwiched between San Lorenzo and Bellavista lies L’Apparita, the special three-hectare plot of Merlot that is behind Tuscany’s first – and one of its most iconic – Merlot wines. Clay, chalk and the altitude (500 metres) create a wine that has both power and freshness. The neighbouring Bellavista produces some of Castello di Ama’s most powerful, yet fine and floral, wines – and is home to their oldest vines. South/southwest-facing, its 22.5 hectares of vines (around 80% Sangiovese, with the remainder Malvasia Nera) bask in the sunshine, sitting in stony, clay-chalk soils. In top vintages, they produce a single-site Gran Selezione from Bellavista (first made in 1978) – an impressive and age-worthy wine.  The final piece of the puzzle is Montebuoni – where we’re standing. Pallanti and Sebasti purchased this 14.7-hectare slice of vineyard in 1997, naming it after the village opposite. Arturo tells us how as a child he once tried to ride his bike up the slope – a mistake he never made again. The gradient here is so drastic that even driving down it in a pick-up frays the nerves, working from the chalky scree that feels destined to leave the wheels skidding, down to the more clay-rich foot of the vineyard. The vines here are divided between Sangiovese (around half the site), with Merlot, Cabernet Franc and Malvasia Nera – and the wines reflect the site’s angular slopes, pointed and driven with a backbone of bright acidity.  It’s been over 40 years since Pallanti arrived at the estate, and over 30 since Sebasti took over as CEO. Together they have nurtured this remarkable property, weaving together the threads of these special vineyards to craft wines that set the benchmark for the region. Cerbaiona is widely recognised as one of the top estates in Montalcino, but has been a little elusive of late. Under Diego Molinari’s stewardship, the winery achieved cult status, but the property was sold in 2015, and hasn’t released any Brunello since. The new owner Matthew Fioretti has added to the radio silence, requesting critics not to score the wines, believing “a softer and more inquisitive form of journalism and criticism might be better than the score bazooka”.  Production is so small that Fioretti doesn’t need to rely on critics to promote the wines, but Cerbaiona has been noticeably absent from recent rave reports on the 2016 vintage from the likes of the Wine Advocate and Vinous. Our woman on the ground in Italy, Annalisa Florian, is one of the few people to have tasted the about-to-be-released 2016 Brunello, the first under Fioretti. Fioretti and his team have overhauled the estate. It’s a brave decision to make such a clear break from the past with a winery of such repute, and testament to their commitment to quality. Due to massive restructuring, Fioretti decided to declassify all the wine made in 2014 and 2015 to Rosso di Montalcino. As he points out, “Several aspects of this wine had formed before taking over the business.” Despite the obvious success of the 2015 vintage, Fioretti commendably didn’t want to rest on Cerbaiona’s reputation. All the vineyards are located on the Cerbaiona hill, just northeast of the town of Montalcino, and neighbouring another Brunello icon, Salvioni. The success of Sangiovese grown on this specific site long predates the Brunello appellation, with vineyards located here for hundreds of years and the wine historically produced known simply as Cerbaiona. The soil is a distinct limestone shale infused with sand and, according to Fioretti, “Almost by doing nothing, you can make an exceptional wine at Cerbaiona. Its vineyard location is that special and unique.” Fioretti, however, wasn’t happy with doing “nothing”. While praising Molinari’s legacy, he felt the estate desperately needed modernising – with serious work to be done in the vineyard and winery. He is very much inspired by what he calls a “tectonic shift” in winemaking in Italy (and elsewhere) over the last 30 years, with a move towards precision viticulture and a more hygienic approach to winemaking. Fioretti sees this as a shift from winemaking as an “art form” to winemaking as “craftmanship”.  In his mind, it was the pioneering efforts of producers like Romano dal Forno in Valpolicella and Luciano Sandrone in Barolo who have shown what can be achieved in Italy with such an approach. Just after taking over Cerbaiona, Romano dal Forno commented to Fioretti, “I’ll tell you what I told Molinari: you can’t make great wine in a barn.” Until recently, the sacristy of the small chapel was the fermentation cellar. The chapel itself was used for wine storage, while the granary and old animal stables acted as barrel cellars. “Hardly a precision and hygienic environment for winemaking,” Fioretti quips. As for the vineyards, “The rootstocks and clones of all the plantings at Cerbaiona were not selection massale nor specially selected material.  It was simply what the nurseries were selling at the time,” says Fioretti. “By 2010, the knowledge that had been gathered around Sangiovese was incomparable to what was understood in the 1970s and '80s.” Fioretti knew they needed replanting with better clones and rootstocks.  He retained and harvested the oldest vineyards for four harvests, working with top agronomists. “We made many attempts to overcome the shortcomings of these rootstocks and clones (which tended to produce enormous bunches, especially in wet years). But we all agreed: the sooner we replanted, the better off Cerbaiona would be.” As such, they’ve embarked on a six-year replanting program, making significant changes. The original three hectares (of which one hectare was dedicated to Bordeaux varieties) have been completely replanted to Sangiovese. An additional hectare of olive groves located on the steepest slope (and Fioretti believes the finest of the estate) has also been replaced with vines. Where possible, vines have been planted at a higher density and Fioretti has also converted the property to organic viticulture. Finally, with the release of the 2016, we find ourselves on the eve of the first Brunello release from Cerbaiona since the 2013 vintage. Fioretti believes 2016 to have been the “perfect” growing season. “The Sangiovese produced is captivating and sumptuous,” he tells me – the latter something he feels isn’t common for the variety. The moderate summer temperatures, the correctly timed rain and dry harvest conditions saw the Sangiovese thrive. The result, says Fioretti, is “a wine with fragrant aromas and a strong acidic shoulder – a guarantee of ageing”. It was in fact the latest harvest in the last five years at Cerbaiona. In Fioretti’s opinion, the 2016 is “not very far from” the 2010 – a vintage he feels is definitive for Montalcino – and comparable to other top modern Brunello vintages such as 2006 and 2007. There is tremendous excitement about the 2016 vintage, as well as the long-awaited return of this much-loved Montalcino estate. The 2016 Cerbaiona will no doubt be constantly compared to the wines made under Molinari, and it will be a fascinating comparison considering the effects of vine material, age of vines, viticultural techniques and winemaking practices versus overriding terroir.  What is clear is that Fioretti has no interest in resting on the laurels of this cult estate, nor simply following the footsteps of his predecessor. From what we’ve heard, it sounds like his labour-intensive approach both in the vineyards and winery is having the desired effect, and Cerbaiona’s legacy is safe. Cerbaiona: a new era

As perhaps befits a man on the brink of his 9th decade, Bill Harlan measures time not in weeks, months or even years, but decades, half-centuries, centuries. It seems natural, sitting as we are among the grand oak fermenters at Harlan, having finished a tasting of 27 vintages of this most renowned of wines, to look at the broad sweep of time both forward and back. 
Harlan, who turns 80 in September, has talked before about his “200-year plan” for the great Napa estate. “This is a work in progress. If you have a long-term plan it makes short-term decisions easier – is this the best decision for the long term? So we ask, how many times a century will we be replanting? Then interplanting of rows and vines – should that be every 40 years or every 50 years?” 
Longevity has always been the plan, ever since 1984, when Harlan, Ric Forman and David Abreu identified six acres of hillside above Oakville as land with the potential to make first-class wine. It was a heavily wooded parcel, chiefly volcanic and sedimentary soil bedrock, which over time would be expanded to the 100ha (240 acre) horse-shoe of ridge, shallow valley and mountainside, with aspects to all points of the compass, that the winery sits on today. To stand on the terrace and look east over Napa is to get a sense of the extraordinary vastness and beauty of the land. Harlan's goal is simple: “We need to know how better to express the character of the property.” The soil is key, of course, but there’s a certain poetry to this slight, grizzled adventurer (something of a daredevil in his youth, he founded the Pacific Union real estate company in 1984 and went on to develop upscale resort Meadowood and co-found Merryvale winery before realising his dream in Harlan Estate. He’s said to be a ferocious negotiator. “You wouldn’t want to get into a poker game with him,” one observer has noted). “Most of the estate is wild land. You still have the animals, the fresh smell of the air, the forest floor. All these things make up the character of the wines.” 
Harlan has no intention of expanding the 16ha (40 acres) vineyard, which produces an average 2,000 bottles a year – just making it “better, and stronger”. He considers that the period of “stabilising” is over, and they are now into a process of “establishing”. 
It’s a subtle difference, and when Harlan hands over full responsibility to his son Will and daughter Amanda later this year (“an 80-year-old oughtn’t to be running anything”), they will have decades of experience to draw on. Bob Levy, the director of winegrowing, joined full-time in 1990, winemaker Cory Empting has been there 20 years, estate director Don Weaver since 1986 – two generations of treading the dirt. This is not to mention the “vinemasters” – veteran vineyard workers who are given total responsibility for sections of vineyard, in order to “get to know each vine,” as Harlan puts it. “The continuity is understanding the land.” 
The tasting took place at a long table in the fermentation room at Harlan Estate in early March 2020. As well as Bill and Will Harlan, Levy, Empting and Weaver were present, Harlan educator Kelli White, Jamie Ritchie, head of Sotheby’s fine wine, Jim Walker (a long-standing Harlan collector) and critic Elaine Chukan Brown. The vintages were tasted young to old, 2016 to 1990, in three flights of nine wines. Harlan talked of a work in progress: this was to see it in operation, a clear progression as vines get older, the estate increases in size and parcel selection gets more targeted. Today a blending session comprises up to 150 wines, taken from multiple different vineyard samples, tanks and barrels. This was, without doubt, one of the signature tastings of my career. These are some of the most expensive and sought-after wines in the world, and to spend a day tasting them – out of magnum – was a remarkable experience. This is not to say that the wines were approached with undue reverence. Harlan, his longstanding team, and the few guests examined each flight with concentration but not awe. The Harlan style runs through the vintages, getting stronger towards the present. The finest wines are brightly perfumed in youth and mellowing to dried petals and dried herb as they age; there is earth, blue fruit ageing to dark, a certain savouriness and sometimes an animal tang (“most of the estate is wild land”).  Another hallmark is understated energy, a pure and clear line that runs through each wine and through the decades. The wines have weight and heft – you know where you are with them – but only once was alcohol, or over-ripeness, mentioned. There is marked vintage variation – the notoriously cool and wet 2011, or the famously warm 1997, for example, are unmistakable. From Bordeaux to Napa, wines of great renown are sometimes described as “smart”, which means they are in some way tailored; they may be delicious, but they are made with an audience in mind. Harlan Estate doesn’t give that impression: you rather understand that here is a winemaker and a team searching for an interpretation of a terroir that is not fixed but changing as the vines age. Bill Harlan returns to this theme again and again. He talks of having “captured” the land, of its protean nature – “as the roots go deeper, the shapes of your blocks move and evolve like amoebas. It’s organic – you don’t lay out the blocks for good, you learn how they change, by being out there in the field.” As the land changes so do its stewards. The official handover to the next generation is imminent and Harlan is happy. “Everything seems to be in place,” he says. “They’ve never done this before, and I’ve never done it before, but it’s working well.” Tasting notes NB: All wines are Bordeaux blends of approximately 15% alcohol, with an average 75% Cabernet Sauvignon plus varying proportions of Merlot, Cabernet Franc and Petit Verdot.

For more than two decades, Donum has been quietly crafting single-site, single-clone and sometimes single-barrel wines. With a new estate vineyard to their name, Rachael Ryan – Senior Buyer at our US arm, Vinfolio – sat down with winemaker Dan Fishman to find out more about the ambitious estate  Like most of the New World, California eschews a hierarchy of vineyards. Yet in the absence of Grands Crus and First Growths, some vineyards are just acknowledged as being a notch above the rest. Ask any winemaker for a wish list of vineyards, and a handful of familiar names is repeated. One of these is the Savoy Vineyard.  Nestled at the north end of the Anderson Valley, Savoy was first planted in 1991 and quickly became a source of Pinot Noir for some of the most respected wineries in Northern California, including Littorai, Williams Selyem, Radio-Coteau and Peay, with many more on the waiting list. Last year, however, it was acquired by Donum, a winery based in Carneros with a reputation for producing small lot Chardonnay and Pinot Noir, sold exclusively to private collectors and therefore rarely seen on the market.  Since it was created in 2001, Donum had slowly expanded its reach beyond Carneros, with vineyards in the Russian River and Anderson Valleys, as well as the Sonoma Coast. With the acquisition of Savoy, however, their already envious collection of vineyards took a very notable – and sizable – jump. The gain of this prestigious vineyard marks a shift for Donum, who will now produce wine from estate fruit only: 130 acres at their estate in Carneros, 16 acres at the Winside Vineyard in the Russian River Valley, 20 acres at the newly planted Bodega Vineyard on the Sonoma Coast, and the 42 planted acres at Savoy Vineyard in the Anderson Valley.   Already well-known for their world-class art collection (with over 50 works by the likes of Keith Haring, Yayoi Kusama and Ai Weiwei), what many visitors may not realise is that Donum now has a solid foothold in each of the premium Pinot Noir and Chardonnay winegrowing regions in Northern California.   In some ways, the vineyards owned by Donum are innately similar, perhaps most closely linked the marine layer. This dense fog rolls in from the Pacific Ocean most afternoons during the growing season and is a key characteristic of each of these vineyard sites. The mechanics of this cooling marine layer are somewhat straightforward. As temperatures climb in inland California, the hot air rises, creating a vacuum into which the denser, colder air sitting over the Pacific Ocean rushes. On a typical summer day, coastal areas are fully clouded over by late afternoon, and the fog continues to creep further inland, searching for gaps and valleys in the coastal ranges to extend its reach. This cold, moist air both lowers sunlight hours and keeps temperatures low. In other words, this coastal phenomenon is an extremely useful aide in the production of lively wines that retain a fresh edge.  Aside from cooling fog influence, however, the vineyards Donum farms are topographically quite different. The estate property in Carneros, with its gently rolling hills and proximity to the bay, straddles the southern portion of both Sonoma and Napa counties (though Donum’s property is firmly situated on the Sonoma side), with consistent winds blowing from the southeast over the San Pablo Bay giving the region a wide diurnal shift and the resulting wines a sense of energetic tension. The Anderson Valley, on the other hand, is a narrow swathe cut through dense, old redwood forest, and it's difficult not to mentally connect the rugged hills that line the valley on both sides with a similar evergreen, earthy core in the wines. The Russian River Valley is a warmer microclimate, further removed from the cooling influence of the ocean or bay, with loamy soils producing a more concentrated style of wine with opulent fresh fruit.  But for Dan Fishman (Vice President of Winemaking and Vineyards) perhaps the most unifying characteristic across each site is a hyper-focus on farming, which he believes is the best – and perhaps the only – way to showcase these unique terroirs. When he joined Donum in 2007 as a cellar intern, the farming was conventional, with routine application of herbicides and synthetic fertiliser. In recent years, however, he has spearheaded a pivot towards organic farming.   Notable features of this approach include an on-site composting program, where manure from local dairy farms is added to pomace from the winery and canes from pruning. Other eco-friendly initiatives include an integrated pest management system, extensive cover cropping (Fishman estimates Donum currently uses 20 different cover crop blends comprised of over 40 different plants), as well as animals brought into the rows for winter grazing. All these systems have improved the soil structure, “bringing more back to the soil than we’re taking from it”, he explains.  A peek into the rows at the Carneros estate reveals this shift in viticultural philosophy, with verdant cover crops and bees hovering. Tucked between the sculptures that dot the property are vines that are farmed meticulously. While the art is spectacular and very difficult to ignore, the attention to detail in the vineyards is perhaps even more impressive. Donum is now one of the first wineries in Sonoma County to achieve Regenerative Organic Certified (ROC) status for all its estate vineyards, and they’ve also been certified organic from the California Certified Organic Farming Association (CCOF) since the summer of 2022. The ROC status, however, is one that Fishman is particularly proud of, as it encompasses not just soil health and land management, but also animal welfare and the working conditions of the employees.    When asked if he has seen a difference in the behaviour of the vines, and in the quality of the fruit, since undertaking a rigorous approach to organic viticulture, Fishman’s answer is an emphatic yes. He points to the 2023 growing season as a prime example. In a year marked by record-breaking rainfall that extended into early spring, the threat of mildew was abnormally high. “Our conventional neighbors were spraying like crazy and still had mildew,” Fishman says, “but we were obviously using organic methods and applying them less frequently, and we had way less mildew. I think the vines’ natural resiliency was coming out.”   In line with a larger overall trend in Northern California, Fishman says he also has been trying to fine-tune the weight and concentration of the Chardonnay and Pinot Noir produced at each vineyard. If Burgundy’s biggest challenge historically has been to achieve even ripeness vintage to vintage, California’s problem cultivating Pinot Noir and Chardonnay been quite the opposite: how to tame abundant sunshine and control vigour resulting from warm days and fertile soils. While the fog assists with this task, one unexpected benefit of the winery’s intensive focus on farming, Fishman explains, is that the vines are more in balance. “It’s on the subtle side,” he says, “but our wine chemistry is looking better too – higher acidity and more flavour at lower sugars.” Opulence has given way to restraint and nuance.   The resulting range of wines at Donum is an impressive display of small-lot vinification, broken down not just by appellation or vineyard, but also often by individual blocks. In 2021, the winery produced six distinct Chardonnays and 17 Pinot Noirs in total from Carneros, the Russian River Valley and the Anderson Valley. With the development of their newest vineyard on the Sonoma Coast, Donum’s already complex patchwork quilt of wines is about to get even bigger.   With a gentle hand in both the vineyard and winery, Fishman hopes to highlight the most minute of variations in each wine, allowing the innate characteristics of each site to shine through. “We have a really intense focus on vineyard flavour first,” he explains.    “We’re not trying to force a house style, just let the vineyard or block do the talking,” Fishman continues, “We’re trying to make the best Pinot Noir and Chardonnay in California, wherever that comes from.” With access to such an extensive assortment of prime locations, now including the illustrious Savoy Vineyard as a feather in its proverbial cap, to say that the future at Donum is exciting is an understatement indeed. While many may think of California Pinot Noir and Chardonnay as one group of wines, a monolith with little variation in style, Fishman and his team at Donum hope to change that mindset, one vineyard at a time.  The Donum wines have historically been available only to those on their mailing list, but we are now working directly with the estate: browse all current Donum listings.

Discovering Donum’s single-site wines

First place: Donum

One name that kept cropping up when speaking to winemakers about wine and cheese pairing was Bernard Antony, a man who now supplies 20 of the world’s 3* Michelin chefs as well as working alongside many of the world’s top winemakers matching cheese and wine at events for Guigal, Angelus, Humbrecht and many more.   We caught up with Jean Francois Antony (Bernard's son and protege) to find out more about Affinage (the ageing of cheese) and their perfect cheese and wine pairings. 45 years at the service of taste Bernard Antony is one of the world’s great cheese makers. Strictly speaking, his mastery
is in affinage, that is finishing and ageing cheeses. From humble beginnings working as a travelling grocer in Alsace, in 45 years he has gone on to become one of the most recognised men in the world of fine cheese.  Bernard Antony was the protegé of the late great Maitre Pierre Androucet – known as “the Pope of Cheese”. Bernard says of Pierre: "To me, he was like a father. He was the man who created me, who taught us everything, to my wife and me. He didn't like me to say it because he wanted to give me all the credit for my success”.  Following on from Androucet’s advice and support, Bernard set up his own cheese ageing cellars in the early eighties in the southern Alsace village of Vieux-Ferrette. The ageing cellars are made up of seven different chambers all at different humidity and temperature levels – ideal for raising and ageing various different styles of cheese. Only when the cheeses are deemed ready and at perfect ripening are they released to the markets and delivered to restaurants. Ageing of cheeses can range from just a few months for the fresher goat’s cheeses to several years for some hard cheeses. Speaking with Jean Francois Antony, Bernard’s son, who works alongside his father, running the day-to-day operations of the cellars, he identifies that the skills in good affinage revolve around a number of key elements. First of all, “raw (unpasteurized milk) is essential if one is to speak of cheese with authenticity…taking into account the breed of animal, the animal's diet, the talent of the cheesemaker and then of course the controlled process of ripening are also key”. The cheeses arrive at the cellars already halfway through ripening and their ageing cellars go into action to give them the final touch. They provide the perfect environment and temperature for ageing as well as the most important element in the Bernard Antony cheese cellars, the natural yeasts that live there helping the cheese mature distinctly and in the best way possible. website. They often pair the cheeses with fine wine so we thought who better to ask for advice on the ultimate cheese and wine pairings than the man himself.  Below is the Bernard and Jean Francois Antony’s essential guide to food and wine matching, split up between the different styles of cheese, with additional advice passed down from Pierre Androucet.  The Floury crust family of cheeses Camembert        Brie de Meux (un peu sale)         St Marcellin and St Marcellin (runny)     Petit Mosellan         Coulommiers         Chaource
 The classic pairing would be Champagne (Blanc de Blancs, Aged and even Rose Champagne) however Bernard Antony advises that you remove the crust as it can make the wine appear more harsh. The bubbles work brilliantly in refreshing the palate from these rich cheeses and the yeast flavours from the Champagne also work really well. Avoid tannic reds with these cheeses. One of Bernard's favourite matches include a Gevrey Chambertin 2012 from Domaine Denis Mortet with the St Marcellin. He states a white wine with both gentle oxidation and good acidity works particularly well with Petit Mosella (Saint Peray from
Domaine Tunnel or Alain Voge) or a fruity red wine with well-coated tannins such as a Beaujolais Cru wines with the Chaource and Colombier fermier. The Washed Crust family of cheeses Epoisses       Langres         Livarot     Munster  Maroilles    Vacherin         Pont-l’Eveque According to Androuet: robust and virile wines, with sap and generous bouquet work best with these potent washed crust cheeses. They require “solar wines“ which can harness the power of washed crusts. Gewurtztraminer Grand Cru from Albert Mann, Chambolle Musigny from Liger Belair would both work well. Pinot Noir from Zind Humbrecht, Bollinger 2008 Grande Annee also a particular favourites with Bernard Antony. The pressed crust family of cheeses Comte     Emmenthal        Beaufort         Gruyere Suisse According to Androuet the matches depend on the evolution of the cheese. Dry white or red wines with bouquet work well, red wine brings a balancing touch of bitterness. These cheeses flatter any red wine by erasing astringency and promoting fruit therefore making White or Red Burgundy a good match. With more ageing of the cheese, wines from the greater South-West, the Rhône Valley and Languedoc Roussillon become better matches. Other personal
favourites from Bernard Antony include Vernaccia di San Gimignano (Italy) White
wines from Valais (Switzerland), and Savignin wines from the Jura. The pressed (uncooked) crust family of cheeses Morbier   Tomme de Savoie fermiere       Mimolette demi étuvé         Salers     Roblochon  Sainte Nectaire Pairing again depends on the maturity of the cheese. The older the cheese the richer the wine. Chateau Latour 2001 is Bernard’s match with Morbier. Saint Joseph Pierre Gonon 2013 works well with Reblochon and Chateau Canon La Gaffeliere Grand Cru Classe St Emilion 2008 works well with Saint Nectaire. The family of blue cheeses Bleu d’Auvergne     Roquefort        Fourme d’Ambert      Blue de Gex          Stilton    Gorgonzola These are best paired with sweeter fruited wine or sweet wines. Avoid red wines as the mould changes the structure, the aromas and brings out the bitterness. Top picks are Rivesaltes Vins Doux Naturels, Pacharenc du Vic Bilh or aged Sauternes even red Vins Doux Naturels such as Maury, Banyuls work well with blue cheeses. The family of Goat and sheep cheeses Ossau-iraty         Brebis cremeux et parfume Brebis Corse     Chevre Frais    Chevre Moelleux et onctueux   Chevre Affiné. Vieux et sec   St Maure de Touraine Banon de Provence Chevrotin des Aravis With this family of cheeses the wine must tame the acidity of milk. The wine must work with the texture of the fat and complexity of the flavours. Androuet confirms the well-known phrase – match local wines with cheese of the same origin, particularly very dry and fruity whites. Dry white wines from the Loire – include the smoky Pouilly Fume, Sancerre, Menetou-Salon, Quincy and Reuilly work well with the goats cheeses from the region. From Burgundy, try the lighter Aligoté, Saint-Véran, Macon villages and from the Alpine pastures the white wines of Savoie or lighter reds of the Loire – Bourgueil and Chinon. Bernard Antony’s particular favourites with these cheeses include wines closer to home including Riesling Vendange Tardive 2007 from Barmes Buecher, 2002 Brundlmayer Gruner Veltliner Kaferberg 2002 and Pinot Gris Grand Cru Osterberg 2016, Domaine Agape. 2020 Calon Ségur, Saint-Estèphe This Calon Ségur has a lovely interplay of earthy, mineral notes with a touch of smokiness, fresh leather and concentrated berry fruit aromas, all beautifully compacted on a focused nose. The wine starts surprisingly supple with the soft, ripe yet detailed tannins slowly building on the palate. This wine takes you by surprise, becoming more and more focused on the palate. There is a lovely pristine quality to the fruit, an equilibrium and tension to the wine. Alongside the fruit are sweeter dark chocolate notes and green herbal tones providing a complex flavour spectrum on the mid-palate. It finishes with great energy, verve and vibrant acidity. The more clay-like Saint Estèphe minerality really comes through on the finish. Excellent. 2020 Ch. Pichon Comtesse, Pauillac There are few wines in 2020 that have such a distinct Pauillac character than the Pichon Comtesse, bristling with pure pencil-lead graphite minerality, backed by earthy notes and toasted spices. There is a lovely suppleness to the wine – very juicy, fresh and ripe but with no hint of over-ripeness, and an underlying mouth-watering salinity. This is a complex palate with plenty going on – baked black fruit, redcurrant, liquorice and a greener, vinous element too. With over 72% Cabernet in the blend (65% Cabernet Sauvignon and 7% Cabernet Franc), it is no surprise the wine has amazing focus, freshness and direction on the palate. The fruit remains crisp and fresh throughout, the cassis beautifully entwined with the graphite notes, all focusing right to the back of the palate. The balance and poise is exceptional, giving real energy to the fantail finish. 2020 Ch. Léoville Barton, Saint-Julien The 2020 Ch. Léoville Barton takes a while to emerge from the glass, but when it does it is boysenberry bright, shifting to pure dark blackcurrant, cedar and soft spice, with an almost orange zest freshness and a scented, floral lift. On the palate, this is beautiful – powerful and fine textured. There’s a vibrancy to the acidity, bringing precision and clarity to the fruit expression, while the powdery tannins have an almost parma violet feel to them. Fresh and lush, there’s a brightness to the blackcurrant and redcurrant fruit that carries to the long finish. Elegant, pure, with much more to come. 2020 Ch. Margaux, Margaux While closed at first, the aromatics of the 2020 Ch. Margaux develops beautifully with air, releasing a complex array of peony, rose floral and menthol aromas with warmer toasted spice notes. There is a lovely concentration and density to the palate both in terms of fruit concentration and tannin detail. The pristine red and black fruit is so fresh and juicy but compacted by the tannins, focusing the wine right down the centre of the palate, providing extraordinary depth. High quality oak tones – cedar and spice – bite at the fruit, creating an
amazing layering effect of spice, fruit and tannin. The handling of the oak is excellent. While very present, it keeps the wine focused and manages the sheer abundance of tannins on the mid-palate. This is a wine built to last.  2020 Ch. les Carmes Haut-Brion, Pessac-Léognan This 2020 Ch. les Carmes Haut-Brion starts a little reticent, a dark brooding nose that slowly opens to reveal a lovely balancing concoction of aromas across the fruit and floral spectrum. Fresh blackcurrant chimes with greener herbal notes giving lift to the nose and an overwhelming sense of freshness. The tannins are concentrated, detailed, fully resolved and – more than anything – they have an energy that excites the palate. The clarity of fruit is exceptional, it almost feels like you are
crunching on fresh berries – it is pristine. This is beautifully balanced, awash with freshness, while the lovely Cabernet Franc herbal notes add florality and lift to the palate. 2020 Ch. Smith Haut Lafitte, Pessac-Léognan The 2020 Ch. Smith Haut Lafitte is plump, dark and a little brooding on the nose, with a mineral note and something a little animal. On the palate, it’s similarly dark-fruited but with savoury depths to complement the quite plush blackberry and black plum fruit. It’s fulsome and round – but with a saline freshness. There is real purity and concentration to the waves of dark, fresh fruit – ripe and plump blackberries and dark plum. The tannins are really ripe and beautifully melded, yet present, providing the necessary structure. This is delicious, and quite moreish with that salinity complementing the otherwise dark-fruited profile. 2020 Ch. Angélus, Saint-Emilion Angélus has produced a profound wine in 2020, continuing a clear move that we’ve seen over the last four years or so – away from power and towards elegance. The team rightly says the 2020 has a “sublimity” to it. It also showcases the finer detail of the Right Bank wines this year – a beautiful, delicate, floral, peony scent, matched by wonderfully dark, smoky, toasted spice, fruitier baked berries and lighter, buttery, pastry notes. The wine has fantastic texture, with detailed but perfectly ripe tannins that ripple across the palate, coated in dense, concentrated forest fruit of fantastic purity. The Cabernet Franc brings mouth-watering freshness and a minerality too. The assemblage is 60% Merlot, 40% Cabernet Franc with part of the Cabernet aged in 30hl foudre (the latter to reduce the Cabernet Franc’s exposure to oxygen).This is plush but beautifully elegant Angélus. A magical wine. 2020 Ch. Canon, Saint-Emilion An abundance of fresh fruit aromas along with saline, mineral and dry spice notes fill the nose. The fruit is darker in character to its neighbouring Ch. Berliquet (tasted alongside), but still straddles the red and black fruit spectrum nicely. The fruit is fantastically fresh. There is a wonderful equilibrium to the wine – while the fruit is pristine, there is no shortage of concentration and mid-palate roundness. The tannins are unbelievably fine, bringing an effortless, structural detail and depth to the wine, firming up on the finish, indicating there’s plenty more to give. The finish is extraordinarily long. This is exceptional, even for Ch. Canon. 2020 Ch. Clinet, Pomerol  The 2020 Ch. Clinet is an immense and stunning wine. The nose is rich with milk chocolate and dried fruit – but also something fresh and crunchy about it. There’s an exoticism to the wine’s expressive perfume – almost shisha-like. On the palate, this is thick, full, round and intense – a weighty
wine with a cocoa richness to it, but an incredible purity of dark berry and plummy fruit. There’s plenty of juicy acidity to offset the wine’s richness and mass of super-ripe tannins. Tight, dense and intense, this is a wine that needs time to fully unfurl. 2020 Enclos Tourmaline, Pomerol The Enclos Tourmaline is opaque in colour with a brooding, compacted nose. It has lovely high-quality, toasted oak notes of dry spice interspersed with iron-esque mineral tones and subtle floral, violet aromas. Ripe, pristine plum and blueberry fruit dominate the palate. The tannins are very detailed and fine. The palate is dense, rich and layered, but not over the
top, with lovely restraint and a distinct textural finesse. What’s more, there’s a vibrant acidic energy running straight down the middle of the palate, adding real excitement. The grey horse stretches its neck out towards me, curling its lip towards my outreached palm, before nuzzling my pocket, in search perhaps of a potential snack. Its head is the size of my torso, its hooves the size of my head, with the entire beautiful beast weighing circa one ton, I’m told. You can sense the power of its immense muscled mass. Nearby, Adelaide Bonnefond, a petite 20-something is calling to the rest of her troupe of friendly giants. Balthazar – the aforementioned grey – is “a real lazybones”, Baudoin can be a bit fast and over-eager, while Olive is a horse of remarkable patience. “Each one has its own character,” Bonnefond says.  We’re in a field a stone’s throw from Ch. Pontet-Canet, where the property’s 10 horses spend their weekends and holidays. This Pauillac Fifth Growth is one of a handful of estates around the region, and indeed the world, that has returned to using horses in the vineyard – in lieu of modern machinery. Unusually, they have brought this operation in house – with their own stables and a five-strong team dedicated to grooming, handling and working the horses, led by Bonnefond.  “I have no idea,” says Mathieu Bessonet – the property’s Technical Director – when I ask how much it adds to their bills. “It’s not important for us… it’s a philosophy.” Herbicides were banned long ago at the estate, and they’ve been farming organically since 2004, certified organic and biodynamic from 2010 (the first Classed Growth to achieve the latter), with horses first introduced in 2008. They’re just one form of livestock you’ll find on the property. When I arrive, a drift of pigs is penned on the front lawn, tasked with munching on the invasive weed, common couch or quackgrass – but there are cattle and donkeys too. Collectively, they consume 60 tons of hay, three tons of barley and 600 kilos of lucerne (organic, of course) – much of which will end up back between the vines.  “A lot of money goes into taking good care of this place – what is in fact our tool for production,” says Bessonet. “The property is over 300 years old, so we’re just passing through. If I spend 20 years here, it’s a long time – but it’s only 3% of the history of Pontet-Canet. We have to take care of this place to be able to pass it on.” And working with horses is just one way in which they aim to do this, reducing soil compaction, allowing water, air and microbes to move through the soil. They can be more precise with their work and – most importantly – break fewer vines. A stunning number of vines are knocked out of place by tractors, something that is considered a natural consequence of modern farming – but not one that this estate is willing to accept.  “Wine, it’s made by the roots of the vines,” says Bessonet. As vines age, their roots creep further down into the soil and Pontet-Canet has some of the oldest vineyards in the Médoc, averaging 55 years in age. And it is the age of their vines, Bessonet feels, that “allows us to express the terroir”, as well as tempering climatic extremes (a growing concern with climate change). While it wasn’t a key reason for the shift back in 2008, using horses also allows them to reduce their carbon footprint – both by using fewer fossil fuels and increasing the carbon-holding capacity of their vineyards, something that is at the forefront of producers’ minds today.  The switch from tractor to horse has changed the way they farm more than can be measured in analytical results, however. “They are not little machines; working the vines with horses, we really become one with the vines,” says Bonnefond. The way you interact with an animal versus a machine is totally different, and she feels that as a result they are much more reactive, more aware of their work and able to stop at any moment. And, as Bessonet notes, even those that have worked at the property for 10 or 15 years can’t help but smile when the horses pass by. As any good manager knows, a happy team will pay endless dividends.  Back in 2008, they started with just two horses, but that number has grown to 10 today. They have a combination of breeds – Percheron and Comtois largely today, although they’ve had Bretons in the past. Percherons are larger, and they’ve been moving more towards Comtois, favouring the slightly smaller and even more gentle breed that hails from the Jura. All are draft horses, historically used in war and agriculture – weighing around double that of the daintier breeds you might see eventing or show-jumping.  Bessonet’s grandmother was, he tells me, almost insulted when he told her they were using horses – seeing it as a step backwards; but, as he and Bonnefond explain, the work is totally different to that of generations past. They might not be powered by electricity, but modern technology and know-how is being used to refine the way they work and the implements they use. Over the years, they’ve developed lots of tools themselves, and worked with a local business to craft others – a slow process that can only be tackled by those with a truly long-term vision.  They buy horses when they’re around three or four years old, so they’ve been broken in and have started their training but can be finished and finessed in-house (“They know the commands, but they’re still young so don’t necessarily listen,” explains Bessonet. “They’re teenagers!”). They’re unsurprisingly picky about the breeders they work with, and ensuring that the training received in their formative years is up to scratch. By the time the process is finished, the moment the plough touches the trunk of a vine, a horse will know to stop instantly, not even needing a human command, avoiding any significant damage. They have a mini faux vineyard with a handful of short rows lined with posts (but no vines) on the estate, a sort of school where they can train younger horses and use at the start of the season, spending half a day so the animals can get back to the pace of work.  Monday to Friday, the horses are at work, stabled next to the winery (with stalls crafted from old barrels). Each horse will work for half a day (sometimes longer if the tools they’re pulling are sufficiently light), before being walked back to the stables to allow for active recovery – evacuating lactic acid in their legs, something that is essential to maintain their health. With the time to groom, harness and unharness, wash down, muck out and feed the horses, each will work around three hours or so a day. Bonnefond’s team will take one horse out in the morning, before going back out with a different one in the afternoon. Alongside their work, the horses are lunged (moved in a circle around a handler, on a long lead rein) – working both on commands and their flexibility. “To change their minds too, seeing something other than the vines” explains Bonnefond.  There are around 10 passes per row a year, four or five to work the soils and around five others – spraying to protect pruning wounds (to prevent grapevine trunk diseases), making holes for planting new vines, spraying horsetail to control mildew pressure, as well as the 500 and 501 preparations (biodynamic sprays). Today, around half of the property’s 81 hectares is worked by horse – and the team is always working to do more, but Bessonet is unsure if 100% is a realistic goal. Copper sulphate – the main spray used in organic and biodynamic viticulture – is spread by tractor, not being something they’d want to expose the horses to (nor put gas masks on them, as was done during the Second World War).   The work is, inevitably, seasonal – and they’re turned out to pasture at weekends and during quiet periods, with lunging to keep them sharp. As soon as véraison takes place (the grapes changing in colour from green to red), “It’s holiday time for the horses,” says Bonnefond, laughing. At that point the grapes become too fragile and could be knocked by the horses, breaking the skins and damaging the fruit.   All being well, the horses work until they’re 18 or 20 years in age, and then Pontet-Canet finds them a home to live out their old age. Retirement can, in fact, be the hardest stage for these work-horses, explains Bonnefond. “They’re used to seeing everyone every day,” she says. One horse, Turbo, kept waiting at the gates, ready to go to work, for well over a month after he’d left the estate, struggling to adapt to his new, restful way of life.  Bonnefond had never worked in agriculture before arriving at Pontet-Canet, having been at an equestrian centre, and her team has similarly varied backgrounds (one used to train trotters and one worked with circus horses, for example). They’ve each got their favourites in Pontet-Canet’s herd, she confesses (hers is a handsome bay who is especially energetic), but they all work with each of the horses, to keep it interesting for the animals, and so that no horse gets too used to any particular handler.  It's certainly not light work – for Bonnefond and her team at least. Days are long and the work is physically demanding, but seeing Bonnefond in the field with the horses, her dainty frame at odds with the gigantic draft horses surrounding her, it’s clear that she loves it. Having a team like this in-house is something few estates can afford, but it’s reflective – as Bessonet says – of the philosophy at Pontet-Canet. Their special band of gravel terrace in the Médoc, shared with the likes of Mouton Rothschild, Lafite Rothschild and Cos d’Estournel – properties that represent the pinnacle of Cabernet Sauvignon around the world, deserves to be protected and preserved in every way possible.  Explore all current listings of Pontet-Canet or read more about Bordeaux

Shipping starts from €15 within Italy and €45 to Switzerland and the rest of Europe for up to 48 bottles (75cl). Costs vary by destination. Larger shipments can be quoted on request.

Wines sold en primeur will be released from the producer after bottling, typically 18 months after the so-called campaign ends. Upon arrival your wine will be stored at Vinfolio in our temperature-controlled warehouse until you decide to take delivery.

We will source this item at the guaranteed price from our network of suppliers and arrange expedited shipment to FINE+RARE.
 The lead-time depends on many variables, but 2-4 weeks is typical for expedited sourcing.
