What springs to mind when you think of Bordeaux? Probably châteaux the size of medieval palaces, formal dinners, and rows and rows of pristine vines, neatly manicured rose bushes the only other signs of plant life. What you’re unlikely to be imagining are cow horns stuffed with manure buried in the ground, or horse-drawn ploughs churning through earthworm-rich soil. ‘In the past, in Bordeaux, you were scared to say you were growing biodynamically,’ says Corinne Comme, who manages 10ha of biodynamic vines at Château du Champ des Treilles in Entre-Deux-Mers with her husband Jean-Michel. ‘Now it’s trendy.’ An engineer and geologist, Jean-Michel Comme was behind the first transition of a grand cru classé estate on Bordeaux’s Left Bank to biodynamics. Although he and Corinne first came across the concept in the mid-1990s, he didn’t begin to advocate for the approach at Château Pontet-Canet in Pauillac until the early 2000s. ‘Corinne was scared,’ he recalls. ‘She thought they would fire me.’ "Behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength" Originally laid out in a series of lectures by Austrian philosopher, scientist and social reformer Rudolf Steiner in 1924, biodynamic farming emerged as a holistic approach to agriculture before quickly evolving into formal certification movements. At its core, biodynamic farming centres on soil health and biodiversity; most distinctively, it operates according to the lunar calendar, with practitioners timing agricultural activities around specific ‘fruit days’, ‘root days’, ‘leaf days’ and ‘flower days’ to align with cosmic rhythms believed to influence plant growth and agricultural processes. For many in Bordeaux – Jean-Michel Comme included – this all sounded a bit wacky. ‘I was young, full of expectations about chemistry; the way biodynamics was presented was so remote that I felt it was crazy,’ Comme says. ‘But with experience, we did change our minds.’ Why? Because behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength. In vineyards, biodynamic farming means specific practices such as hand-harvesting, using natural composts made with specific herbal and mineral preparations, avoiding chemical fertilisers and pesticides, and treating the entire vineyard as a self-sustaining ecosystem. In the cellar, there’s an emphasis on minimal intervention, using native yeasts, avoiding commercial additives, keeping sulphur use to under 70ppm, and employing gentle pressing and ageing techniques that respect the wine’s natural development. While biodynamics took root in regions like the Loire and Burgundy in the 1990s, biodynamic winemaking in Bordeaux largely began in the new millennium, with just two early St-Emilion exceptions: Château Meylet, which has been practising it since 1987, and Château Fonroque, experimenting since 1995 with direction from Loire legend Nicolas Joly. This delay largely stemmed from two factors. First, Bordeaux’s humid maritime climate means that vines are especially vulnerable to both downy and powdery mildew, making the avoidance of synthetic fungicides a risky business. Second, large châteaux with multimillioneuro operations were reluctant to abandon the technological viticulture and winemaking that had built their global reputations in the first place. Comme, however, was convinced of the virtues of biodynamics. He began by seeking the assistance of François Bouchet. The Loire Valley winemaker was one of the first in France to pioneer biodynamics, also consulting for Domaine de la Romanée-Conti, Domaine Leroy and Domaine Leflaive in Burgundy. Bouchet guided the transition to biodynamics at Comme’s Château du Champ des Treilles; then, he persuaded Château Pontet-Canet owner Alfred Tesseron of its merits. In 2004, it was trialled on 15ha (about 20% of the estate’s total growing area) of the fifth growth at which Comme was also technical director. A severe mildew outbreak in 2007 led to the use of pesticides, undoing three years of progress, but it then became a crucial lesson that strengthened their long-term commitment to biodynamics. ‘They believed the fruit had more expression, more brightness,’ says the current technical director at Pontet-Canet, Mathieu Bessonnet, who reveals that they converted the whole of the growing area soon after. ‘It’s obviously much more difficult, time-consuming and expensive, so it was very risky,’ he adds. Since then, biodynamic farming has become a significant and growing practice across different classed growths in the region, with some of the most prestigious estates – such as Château Latour and Château Palmer – adopting biodynamic methods (the latter certified). ‘The link between the wines and the place where the fruit came from had become less and less obvious,’ says Château Palmer’s technical director Thomas Duroux, commenting on the region’s turn to the trend. He notes that, since the noughties, many have adopted organic practices in a bid to reverse this perceived drop in terroir definition. ‘Biodynamics is, in a way, the same story as organic farming, but with a larger vision,’ he adds. This shared perspective has led to more cooperation between practitioners. Every spring, the Médoc branch of the Biodynamic Agriculture Movement gathers at Château Ferrière. After unearthing a thousand manure-filled cow horns and replacing them with silica-filled ones (a process reversed in autumn to produce preparations 500 and 501, required for Demeter certification), participants share wines and gardengrown salads. The humus removed from the cow horns is stored in a cold, damp facility and made available to members. ‘We do that for free,’ says Claire Lurton, owner of Château Ferrière. ‘It’s a community.’ Though ‘community’ might be too strong a word for some, these gatherings symbolise a deepening professional exchange that has emerged among estates of all sizes through the practice of biodynamic winemaking. In fact, the shift among the classed growths has happened at the same time as these practices have been adopted by smaller growers arriving in the region. Christophe Landry of Château des Graviers, for example, returned to Arsac in the 1990s and began practising biodynamics around the same time as Comme at Pontet-Canet. He’s consulted for the Lurton estates and other properties. Originally from Minervois in Languedoc, Michel Théron established Clos du Jaugueyron nearby and has been certified biodynamic since 2008, while Laurence Alias and Pascale Choime – who are both from southwest France – established Closerie des Moussis, a patchwork of sites across 2ha, including a 170-year-old pre-phylloxera plot leased from Théron. On the Right Bank, other producers began switching lanes even earlier. Le Puy, owned by the Amoreau family, began practising in 1998, with certification since 2013, and Château Gombaude-Guillot in Pomerol has been certified biodynamic since 2006. While larger estates like Latour and Palmer collaborate on issues like mildew, smaller producers tend to engage more with one another. Shared biodynamic practices, however, are definitely helping to break down barriers. For example, Château Haut-Bages Libéral maintains regular communication with its neighbours at Château Latour, and the son of Théron at Clos du Jaugueyron interned at Château Palmer for two months. Can we speak of a unity of praxis? Not exactly. There is considerable variation in which aspects of biodynamics winemakers emphasise, regardless of estate size. The primary aim across the board is achieving living soil with rich biodiversity to promote deep-rooted vines. In pursuit of this, some winemakers emphasise tree growing or cover cropping (like Haut-Bages Libéral, which also recently planted a variety of local and fruit trees). Others, such as Le Puy, let nature take its course, allowing a diverse array of plants and flowers to sprout from the earth. Whether certified or not, biodynamic practitioners throughout Bordeaux use homeopathic treatments like nettle teas for the vines – they are believed to stimulate soil health, enhance plant immunity and improve nutrient uptake. More important than any of this, however, is the concept of energy. How can the energy of the plant be retained as its raw material transforms into wine? Every winemaker I visited was at least intrigued by the concept – and most were captivated. After a few days in the sometimes eerily flat Médoc, I drive through the verdant hills of St-Emilion to Le Puy, arriving with a raised spirit. Standing before a 5,000-year-old Celtic cromlech, Harold Langlais, the estate’s director, tells me, ‘Le Puy is a place of energy and life,’ pointing to its deep history as an intersection of water springs. At modern-day Le Puy, this philosophy extends from the vines to the cellar. Indeed, many others I speak to express that, since adopting biodynamics, the most striking change in their wines has been an increase in ‘energy’. It’s a term without a precise definition, but according to Château Palmer’s makers, something shifted with the 2015 vintage, the second year after full conversion. ‘You cannot measure it,’ Thomas Duroux says. ‘You can just feel it.’ At Château Durfort-Vivens, where the vineyard was operating under biodynamic principles by 2013 (with full conversion by 2016), owner Gonzague Lurton recalls the 2014 vintage as ‘the first where you really feel the energy of biodynamics’. It’s tactile and warming, with a sophisticated grip and charm. ‘It’s what I love – the linearity of tannins, never weak from start to finish. With many of the estates I visited, their wines showed an immediate appeal, vibrant even in their youth. Is energy just another way of describing freshness? Laurence Alias at Closerie des Moussis trained as an agricultural engineer; for her, energy and vitality are tied to the physical properties of grapes grown biodynamically. ‘We have more acidity, that’s an analytic fact,’ she tells me, standing in front of a newly acquired plot of vines bordered by forest. It might be romantic to think of energy as something ineffable, but it’s also rooted in what remains within the grapes. ‘Our idea of energy is based more on Einstein than Steiner,’ Langlais later qualifies. ‘Energy is matter.’ Biodynamic winemaking in Bordeaux: five to follow Château Pontet-Canet At the 55ha Pontet-Canet estate in Pauillac, an immensely smooth operation is palpable. Winemakers here have spent almost two decades honing their biodynamic craft, continually moving towards a goal of self-sufficiency for the estate. Sturdy Comtois horses, introduced in 2008, now work half the vineyard, preventing soil compaction. Vineyards are sprayed over a single day using compost and herbal teas produced from plants grown in and around the property and processed in the state-of-the-art infusion room. Biodiversity-boosting fruit trees and hedges have been planted. The estate even employs a carpenter who repurposes wood from vats used on the property. Ageing involves custom-made wooden eggs and qvevri-style amphorae, with no fining and minimal filtration. The result? A Pauillac with untypical levels of energy and minerality, and a plush, velvety texture. But it’s more than that – according to Bessonnet, thanks to a low-intervention approach across the board, ‘you can really feel the soil.’ Château Palmer Thomas Duroux’s conviction in biodynamics is based in what he calls a ‘holistic vision’. ‘We started to see the entire place as a living organism,’ he says of Château Palmer, one of the most storied and historically significant third-growth estates in Bordeaux. When converting (a process that started in 2009), the Margaux estate was initially guided by François Bouchet’s son Matthieu, but now it follows its own evolving philosophy, integrating cover crops, animals for fertilisation and estate-grown vegetables and meat. ‘It’s just going back to agricultural common sense,’ Duroux says. ‘That was the way to grow anything before World War II.’ This respect for nature results in wines that are deeply tied to their terroir. ‘If I had to describe the wines how they are today, compared to how they were before, I’ll just say that it’s not a revolution, but we have the feeling that the wines have a better identity,’ says Duroux. He likens biodynamics to restoring an old painting: ‘Suddenly, you see small details that you were not able to see because of the dust.’ The estate uses stainless-steel vats for fermentation and temperature-controlled rooms for barrel-ageing, combined with nativeyeast and low-sulphur winemaking, to produce its esteemed Alter Ego and Château Palmer cuvées; both have been increasingly celebrated among critics and drinkers since the turn to biodynamics. ‘We just think it does help to go a little bit further in the interpretation of the place,’ says Duroux. Château Durfort-Vivens Standing over a rustic sorting table explaining how it used to work, Gonzague Lurton is visibly passionate about the savoir-faire of the past. This sensibility is reflected in the current winemaking practices, too, and in the second-growth Margaux estate’s reputation (and critics’ scores) increasing year on year. The thing to emphasise is that what began with a biodynamic approach in the vineyards led to a series of domino effects that changed the character of the wines. In search of what Lurton calls greater ‘singularity’, the proportion of Cabernet Sauvignon had already risen to over 90% by 2014 (from around 75%); and with the use of indigenous yeasts during fermentation and the reduction of sulphur levels over time (initially sparked by Demeter’s upper limits of 70mg/l), the wines have become more aromatically complex and expressive. The introduction of amphorae by Italian producer Tava has allowed for microoxidation without overextraction, contributing to a more delicate balance of flavours, with the 2019 estate wine a blend aged one third in amphorae and the rest in barrel. ‘It’s not a big wine,’ says Lurton. ‘And it’s what I was looking for with biodynamics, in terms of style.’ Château des Graviers Christophe Landry’s pioneering status in Margaux stems from an instinct refined over decades at his own estate. He grows medicinal plants — horsetail, absinthe, calendula, chamomile — for vineyard treatments, as well as using the manure from his own cows. ‘What we need to remember is that biodynamics isn’t just a practice,’ he tells me. ‘It’s about finding your own path to self-sufficiency.’ His precision extends to the cellar, where he uses concrete tanks, amphorae and oak barrels (produced according to the biodynamic calendar) tailored to each of the five cépages’ oxygenation needs, then ages the wines for different lengths of time. Timing is everything, with harvest choices also following the biodynamic calendar. Obsessive care for the vines’ life cycles goes hand in hand with the level of precision in the cellar. The outcome is two phenomenal wines that are, as Landry puts it, ‘thirstquenching’. Château des Graviers and Quintessence — which contains a higher proportion of Petit Verdot and is aged longer in barrel and amphorae — are aromatically expressive, velvety and strikingly lively, with the latter offering more depth and an enveloping finish. Expanding to 18ha, Landry has also turned his focus to Clos Dufourg, cultivating vines on previously wild land nearby and hand-building a striking new cellar with cement tanks painted with clay from the surrounding earth. Le Puy For technical director Harold Langlais, the Le Puy estate’s significance lies in how it challenges Bordeaux’s conventional identity. Outside of the region’s traditional focus on appellations and classifications, Le Puy sits on a plateau near St-Emilion. The estate’s land is unusual, with no topsoil but a deep limestone bedrock beneath red-brown clay, which forces the vines to develop deep roots to access the earth’s natural water and nutrients. This is further supported by horse-ploughing and biodynamic sprays made from horsetail, buckthorn and nettles, which grow on the property. ‘Our approach focuses on rooting the vine deep,’ Langlais explains, ‘encouraging it to search out hidden nutrients.’ A vigorous wind circulates around the vines, and Langlais explains the effects of the elements. ‘The beauty of Le Puy is that it’s an acid factory. The whole place creates acidity in the berries.’ The biodynamic philosophy extends to the winemaking, with two different processes applied to their 100% Merlot cuvées. Cuvée Emilien uses a ‘decantation method’, or ‘fermentation by infusion’, while Barthélemy is produced with zero sulphites and a process of lees-stirring called ‘dynamisation’, which is done on fruit days and involves a specific motion to create a vortex in the old barrels it ages in. ‘Barthélemy is much more intense,’ Langlais says. ‘All the matter taken by the plant is in there.’

And with 20-plus years’ age, it should be perfect for drinking now. Even though it will accompany a roast chicken, this wine is like a celebration and a meal in and of itself.”  2018 Klein Constantia Vin de Constance – chosen by Jeffrey Koren, Head of Wine at Marceline, London  “While it’s easy to open a perfunctory bottle of Port or Sauternes at the end of a Christmas meal, the oh-so-delicious Vin de Constance by Klein Constantia has become my go-to sweet wine for the festive period over the past few years. Steeped in history, Vin de Constance was famously a favourite of Napoleon and lauded by authors like Jane Austen and Baudelaire. These days, winemaker Matt Day has revived this legendary dessert wine to its former acclaim. It always offers wonderful notes of apricot, honey and spice. But most importantly, it’s balanced by refreshing acidity that is an absolute necessity after an indulgent holiday meal.”  Hauller Frères Pinot Gris La Chappelle Signature – chosen by Joséphine Duffau-Lagarrosse, Ch. Beauséjour   “Ludovic Hauller is a long-standing friend I met during my studies in Burgundy. I appreciate the precision that his family channels into the wines, and this cuvée showcases great finesse, with freshness and elegance, mirroring the granite terroir in which the vines grow. It’s a Pinot Gris of remarkable complexity, hailing from a plot that sits below the Chapelle Saint-Sébastien de Dambach-la-Ville. She makes very few bottles of this very elegant and vibrant wine, which is among my favourite reds.”  2021 La Morandina Moscato d’Asti – chosen by Donald Edwards, Head Sommelier at La Trompette, London  “Beyond the best white Burgundy I can lay my grubby mits on, I’ll be cracking the second bottle on a case of La Morandina’s 2021 Moscato d’Asti – part of a new festive tradition. Back when my wine appreciation was still protean, I heard a rumour that Moscato d’Asti – the sweet fizzy floral stuff that we sold in my Glasgow Oddbins – ages magnificently. Twenty or so years later, I’m the Head Sommelier at La Trompette, hosting a big Piedmont-themed wine lunch. Barolos and Barbarescos aplenty litter the room, but the wine that stops me in my tracks? A 2013 Moscato d’Asti from Giuseppe Vajra. It was phenomenal, still gleefully tasty, but now with a touch of extra weight, more waxy lime skin and late-evening summer flowers, heady in its bouquet. Here she was, my white whale, and, boy, she didn’t disappoint.  “Last December, visiting La Morandina in Asti, I asked whether they had anything with a bit of age and lo! a 15-year-old magnum appeared. My stars had aligned for a second time – the wine equally lovely, offering a bit more exotic spice, cardamom and coriander seed along with the sweet creamy lime zest. Crucially, this time I could see the germ of a plan. Each year, I would buy a cast of Moscato d’Asti, building a reserve of Moscato to steadily enjoy over the coming years. I’ll be the Christmas king of deliciously sweet floral fizz. So, on the morning of 25th, I’ll be twisting the top off the second bottle from last year’s case and smugly enjoying my Moscato and crumpet as I let my mind wander over the riches I’m preparing for the coming years.”  François Cotat Sancerre Le Mont Damné and Massican Gemina – chosen by Alex Sarovich, Founder and CEO of Own Rooted Hospitality  "As the oldest of five in a large Italian family, I've learned that selecting the perfect wine is an art form that requires careful consideration of both the food and the audience. With “freshness” and “structure” often the buzz words defining the best Bordeaux wines of recent warm vintages – the plush richness and suppleness brought by the Merlot variety often seems undersold compared to the role of the Cabernets in the blend.  Christian Moueix, Director at Petrus (1970-2008), Trotanoy and La Fleur-Petrus; John Kolasa of Chateau Rauzan Segla and Chateau Canon (1997-2015); Maylis Marcenat of Chateau Clos de Sarpe; as well as Pascal Baratie of Chateau Haut-Brion - the First Growth with the highest proportion of merlot in its blend - identify how global warming is affecting merlot and what this means for its long term future in the region.  We also discover why merlot became central to Bordeaux’s success and today remains much loved, providing it is grown in the right place and managed correctly. 
Managing rising alcohol levels There is no grape more synonymous with the region of Bordeaux than merlot, playing an extensive role in almost all wines of the region on both the Left and Right Banks. Whilst it plays second fiddle to the cabernet sauvignon dominant wines of Saint-Julien and Pauillac, everywhere else from Pessac to Pomerol it plays a significant role in the blend. But merlot in
recent years has become a concern for many in the region. With the rising climatic temperatures in Bordeaux, some vignerons are struggling to manage ever-rising alcohol levels, whilst trying to achieve full phenolic ripeness of the tannins in the skins and seeds.  Merlot is an earlier ripening variety than cabernet sauvignon and its sugar levels can increase quickly in hot temperatures, leaving an imbalance between sugar and tannin ripeness. The more steady the temperatures are through the summer, the more chance the sugar levels and phenolic ripeness will reach optimum levels at the same time. In a hot vintage, sugar levels rise too quickly forcing vignerons to pick the grapes before they have had time for the tannins to reach phenolic maturity, afraid that if the sugar levels become too high, there will be a drop in acidity, as well as causing serious problems at fermentation. For Pascal Baratie, vineyard manager at Chateau Haut-Brion the higher levels of alcohol have not however proved problematic for them, stating “since the 2000s, there has been a gap between phenolic maturity and technological maturity (measurement of sugar and acidity levels). Today, during the maturity checks in the vineyard before the harvest, when we taste the grapes at 13 degrees potential alcohol, we note that the tannins are still hard… so we need to wait to obtain more supple tannins and greater phenolic maturity.  The balance obtained today, is certainly different to pre-2000 levels, but we are fortunate to be on a great terroir, which produces balanced wines, with a good tannic potential even with high alcoholic degrees. The regularity of great vintages of the last 20 years lets us think that the supposed problem of alcoholic degrees is more in the head than in the glass.” However not all Chateaux are fortunate to share the same terroir as Haut-Brion. Drought in Bordeaux 
Higher alcohols are not the only concern with merlot. Drought is also becoming problematic when trying to plant young merlot vines in Bordeaux, particularly on gravel soils. Merlot requires moisture to grow and whilst the clay-rich soils of Saint-Estephe on the Left Bank and Pomerol and Saint-Emilion on the Right Bank naturally retain moisture; the gravel soils in Margaux, Saint Julien and Pauillac are becoming increasingly dry in the warming climate. John Kolasa states “this is becoming a real problem where there is deep gravel, like in Margaux.  Young merlot vines need years of root growth to break through the gravel and reach water reserves below, but in parts of Margaux where the gravel can be up to two metres deep, the roots take longer than three years to break through. Three years is the current allowance for
irrigating vines in the region. It is once this irrigation stops that these vines suffer and die. It is one of the reasons you see less merlot being planted in Margaux. If they can’t find a way for young merlot vines to survive in gravel soils, it will undoubtedly lead to a change in style over the coming years.”  Merlot's susceptibility to disease Global warming effects are not just an increase in temperatures but an increase in erratic weather episodes, leading to a heightened pressure of rot and mildew – something merlot is much more susceptible to than the cabernet varieties, due to its thinner skin.  “Merlot is a wonderful variety but it is more difficult to manage these days” states Maylis Marcenat from Saint-Emilion's Chateau Clos de Sarpe. “In 2018, our merlot suffered a lot from mildew. We lost around 40% of our production mostly on the merlot vines. The cabernet franc has a better resistance.  The weather is more uncertain these days, a lot of rain followed by a very dry season makes it difficult to predict.”  Rot is also a concern and certainly nothing new in the region, it plagued the merlot vines of the late sixties and seventies. So much so, that replanting of the variety was in fact banned in Pomerol following the disastrous 1968 vintage. Vignerons were instead strongly encouraged to plant cabernet sauvignon. Christian Moueix recalls, “I remember, of course, the terrible rot of 1968 and the desire of some researchers to find a varietal resistant to rot. I attended many meetings in 1970-1971 and protested against the banning of planting Merlot. It was a violent controversy and, in 1972, I refused to plant those new cabernets sauvignons in Pomerol.”  Moueix’s decision was justified. John Kolasa states following this ”it became very fashionable to grow cabernet sauvignon in the '60s and '70s on the wrong rootstocks!” Kolasa ended up pulling out all the cabernet sauvignon vines planted at Chateau Canon during this time, stating, “the damn things would never ripen”. The early '70s saw a bout of poor vintages for the region largely due to bad weather either just before or during harvest. The cabernet sauvignon at the time was unripe, incredibly green and it was the earlier ripening merlot that became the more reliable source. 

Kolasa outlines one theory behind the rot that plagued Merlot on the Right Bank at that time. “Much of the Right Bank back then was undeveloped, compared to the bigger estates on the Left Bank. The vineyards were also producing many other fruit and vegetables. When the vineyards were ploughed by horse and cart these fruit trees were not a problem, the horse
simply went around the tree, but with the introduction of tractors and machinery, many vignerons simply chopped down the tree.  The trouble is they killed the tree but left the roots in the ground. Similarly to roses, if you leave dead roots in the ground they become infected with fungi. These dead roots in the soil came to plague vineyards with rot at that time.” John recalls finding rotting roots all over the vineyards at Chateau Canon. His first year at the property in 1997, he made two separate cuvees, one from vines away from the tree roots and one nearby.  “I only had to put my nose in the glass of the two to know which one was which, the wine made by the affected vines smelt terrible. Following that experiment it was so clear to me. I took up all the vines affected. Pulling up old vines is never something one wants to do, knowing that it will takes decades for the new vines to reach maturity, but these vines were so infected I was left with no choice.”  Merlot as a more reliable source of ripe fruit found favour through the '70s and '80s. By the mid '90s, the influence of the American market enamoured by the plush, richness and soft texture the merlot provides in the blend, only saw more plantings of the variety.  For Christian Moueix the Americans love affair with Merlot stopped in 2005, with the release of the film Sideways which saw the main character famously state, "If anyone orders Merlot, I'm leaving, I am NOT drinking any f**king merlot!”. It is worth noting his favourite wine in the film was Cheval Blanc, a merlot blend! The damaging effects of global warming have only further put merlot in the shadows as the cabernet varieties share the limelight, but these vignerons are confident of its future in Bordeaux. 
Merlot still remains essential to the Bordeaux psyche Christian Moueix states: “Global warming has been positive for Bordeaux as everybody would admit. The rising of alcohol is almost impossible to control since it comes not only from heat and sun but from the level of CO2 in the atmosphere”. For Moueix provided merlot is planted in the right soil he is confident in its prolonged future in the region.  “We still replant merlot in Pomerol and Saint-Emilion; this is the varietal best suited to our terroirs. To manage the climate, we have adapted the canopy to avoid the direct impact of sun. This is all we can do at this point unless the addition of water becomes legal.” Baratie from Chateau Haut Brion outlines the importance of balance that both the merlot and cabernet varietals still bring to the classic Bordeaux blend. “We do not want to part with Merlot because it is satisfactory today even in hot years and for the future we want to keep its current proportion. We have to keep a balanced planting to obtain maturity on plots of
merlot and cabernets whatever the weather conditions of the year. From time to time, we have cooler years and it is interesting to have matured Merlot, when the cabernet sauvignons are likely to be harder and herbaceous. In 2011, a very dry spring year, Chateau Haut-Brion was made up of only 35% merlot, while in 2012, a more classic climate year, it was made up of 65.5% merlot. Over two successive years, the climatic conditions were different and led us to select a different proportion of grape varieties in the wine. We can see that we cannot do without merlot in one vintage like the other. Merlot brings an interesting juice, as well as sweetness, fine and supple tannins which make it essential. It may be replaceable with another grape, but at the moment we do not have the knowledge.”  The importance of terroir Despite the risks of rot, drought, mildew and high sugar levels, fantastic merlot continues to be grown in Bordeaux providing the terroir is right. Speaking with these vignerons one thing they all agree on is that the soil remains the most fundamental aspect to its success - in the past, today and in the future. “Merlot grown on clay and limestone soil can still preserve freshness as well as minimal hydric stress in my terroir.  So why not use it?" states Maylis Marcenat from Chateau Clos de Sarpe. “The merlot is still an exceptional plant. The sweetness, the complexity is unique. I think in Saint Emilion, and especially on clay and limestone, all the merlot are more creamy, tasty, with a lot of juiciness.“ At Chateau Haut-Brion, Baratie agrees, “We tend to favour merlot on grounds that are relatively well supplied with water and to favour cabernet sauvignon on gravelly soils. But we have plots of merlot on gravelly soils, little supplied with water, which give very great wines every year and we do not plan to change the grape variety on these very qualitative plots. But
in addition, we are adapting later ripening and drought-resistant rootstocks.” Intra-plot vinification, precise technical understanding of viticulture, clonal development, replanting better-matched rootstocks, has all helped Bordeaux and Merlot in particular, cope with the changing climate. But the art of blending is still vital part of the wines of Bordeaux and today has become an important measure to reduce the alcohol in Merlot-dominant wines. Cabernet Franc to the rescue Many wineries up and down the Medoc are lowering the proportion of merlot in their blends, opting more for cabernet franc. John Kolasa outlines how cabernet franc can effectively lower the overall alcohol level in the blend of a wine. “Blending just 5% of cabernet franc in with merlot can be an effective method of lowering the alcohol, as well as adding freshness. It is something Petrus did with the 2019 vintage. Look at the success of Chateau Figeac in 2019 – a third cabernet franc, a third merlot and a third cabernet Sauvignon. This is a big increase of cabernet franc in the blend and is performing better in the warming climate”. 
The future of Merlot Despite the difficulties Merlot is facing, there seems plenty of ways vignerons in the region are adapting to manage Merlot differently in this warmer climate. Marcenat of Clos du Sarpe believes “the way of cultivating must change. Less green harvesting, we no longer need too much concentration in the grapes, we must be careful with the thinning of the canopy. Merlot needs more cover crops, it benefits from keeping as much grass as possible and we must choose the right organic fertiliser. With this in place, merlot has a future”. For Baratie “The balance of the wines obtained in recent years suits us, thanks to the contribution of merlot, cabernet franc and cabernet sauvignon, so we are not worried about the future of merlot. However, thanks to our clonal selection initiated by Jean-Bernard Delmas, today we choose clones on a different criteria from those desired in the past. We currently favour two criteria: the Total Polyphenol Index (IPT) and yields that are not too low.” No doubt helping to modify concentration of alcohol and adding structural freshness
from the higher levels of tannins. Moueix too sees Merlot having a long future ahead in Bordeaux but at the same time would welcome new clones of Merlot that produce less alcohol. “Nevertheless,” states Christian, ”I dare to compare it to a vaccine: it would need a lot of experiments before taking the risk of replacing the present clones which produce wonderful wines.” Perhaps the biggest threat for the future of merlot therefore comes not from the clay-rich soils of the Right Bank but from the gravel-rich soils of the Medoc, where it remains a minority in the blend, but nevertheless an important element to the profile of these wines. If a solution cannot be found for growing young merlot vines on gravel soil, will we see alternatives varieties in the assemblage and a change in style? Think of a cocktail. Is vermouth in it? If you’re thinking of a classic cocktail, there’s every chance it is. The Martini, Negroni, Manhattan – I could go on. And on. For whatever reason, vermouth has not always received the recognition it deserves for propping up so many exquisite mixed drinks. In fact, I’d hazard that a fair amount of cocktail lovers don’t know vermouth is in their glass at all, or, if they do, their knowledge of the liquid might be a little patchy. When it comes to vermouth, there are a few things you need to know. Vermouth is an aromatised wine which hails from Torino, Italy. It is generally accepted that vermouth – as we know it, not the kind prescribed by Hippocrates in 400BC for ailments – was invented in the 16th century. In 2019, a Geographical Indication was introduced to protect the style and quality of vermouth from its birthplace, Turin. Under these regulations, vermouth must be made with at least one Italian wine, wormwood must be the predominant flavour and the wormwood used must be grown in Piedmont. The final liquid must also be between 16% and 22% alcohol in order for it to be labelled “Vermouth di Torino”. The two most common styles of vermouth are sweet and dry. The former is red in colour and as such is often called Rosso. This is the style used in your Manhattan and Negroni. Dry vermouth is white (Bianco) in colour and will be used in your classic Martini. Four classic Vermouth-based cocktails The Negroni It might be hard to believe given the Negroni’s current notoriety, but this simple serve of equal parts vermouth, Campari and gin was incredibly slow to catch on. As is often true in cocktail lore, there are a couple of people credited with its invention. The most widely accepted is a Count named Camillo Negroni who asked a bartender at Caffè Casoni in Florence to make his Americano cocktail a touch stronger. They duly obliged and switched the soda water for gin. This is believed to have taken place in 1919. A smaller camp credits a man named General Pascal Oliver Comte de Negroni with the invention of the cocktail in Senegal between 1855 and 1865. Setting aside the inventor for the moment, the Negroni, unrefutably, became de rigueur in the early 20th century – requested across Europe and favoured for its bitterness and alcoholic strength. Orson Welles was a very high-profile fan, famously quoted in 1947 for saying: “The bitters are excellent for your liver, the gin is bad for you. They balance each other.” In the years that followed, the Negroni’s popularity waned when appetites became more saccharine in nature. In the early 2000s, things shifted again as the Negroni began to appear on cocktail menus at some of the best bars in the world. It wasn’t long before the recipe featured in cocktail books and drinks sections of influential titles, such as The New York Times. Fast forward to today and the Negroni is regularly named the most popular cocktail by patrons and bartenders alike. There are countless riffs on the original recipe and an entire week is dedicated to celebrating it. How to make a Negroni 30ml sweet vermouth 30ml Campari 30ml gin Ice Slice of orange (garnish) Pour all ingredients into a glass with ice and stir well. Add garnish. The Manhattan The Manhattan has assumed many guises over the years, making its exact origin a hotly contested subject. Some believe Sir Winston Churchill’s mother was served the first Manhattan cocktail at the eponymous club in New York in the early 1880s. Others question the validity of this claim as she was likely in the UK, pregnant with the future Prime Minister, around this time. Some believe a New York bartender by the name of Black invented the recipe at the Hoffman House. The earliest known record of the Manhattan, in which this name and the recognised recipe, appear is in The Sunday Morning Herald in September 1882. Unhelpfully, some referred to a very similar recipe as a Jockey Club or Turf Club Cocktail. The classic recipe consists of Rye or Bourbon, sweet vermouth and bitters. During Prohibition, it was not uncommon for people to use a different whiskey as the base ingredient. If you substitute American whiskey for Scotch whisky, you have a Rob Roy cocktail. How to make a Manhattan 50ml Bourbon 25ml vermouth 3 dashes of orange bitters Cocktail cherry (garnish) Add all ingredients into a glass filled with ice and stir. Strain into coupe or Martini glass and garnish. The Americano The Americano recipe was invented at Gaspare Campari's bar in Milan in the 1860s. The cocktail of equal parts Campari, vermouth and soda water, was originally named “Milano-Torino” after the principle ingredients’ home towns of Milan and Torino respectively. The simple serve was renamed in honour of its growing fanbase: American tourists. The Negroni recipe was based on the Americano and contains two of the three main ingredients – with the soda water switched for gin. While many associate James Bond with the Vesper cocktail or a Martini – shaken, not stirred – the first cocktail associated with 007 in Ian Fleming’s work was actually an Americano in Casino Royale. It is later written, in A View To Kill, “Bond always had the same thing – an Americano”. How to make an Americano 30ml sweet vermouth 30ml Campari Soda water Slice of orange (garnish) Fill glass with ice, add Campari and sweet vermouth. Top with soda water and stir gently. Garnish. The Adonis A slightly less well-known vermouth-based cocktail, the Adonis was invented in honour of its Broadway musical namesake. The musical, based on William Gill’s novel, first opened in Chicago in 1884 and went on to become the longest-running show of its era. As the name suggests, the story follows a beautiful male statue who comes to life and ultimately opts to return to stone. The first reference to the Adonis cocktail was written in 1887. Of course, the reputation and quality of the wines from this estate long predate the modern-day critics. Prior to the 1855 classification, Château La Mission Haut-Brion was one of the most expensive wines in Bordeaux, second only to its historic neighbour Château Haut-Brion. The two properties are both owned by the Dillon family (Domaine Clarence Dillon) who bought Château Haut-Brion in 1935 and purchased Château La Mission Haut-Brion 48 years later, in 1983. We caught up with Deputy Managing Director Jean-Philippe Delmas and Sales Director Guillaume-Alexandre Marx to find out what makes this Château so special. 
In the vineyard Since taking over the property in 1983 the Dillon family undertook a major effort to upgrade the estate. They initially focused on the vineyards. Substantial investments were made to replant vines on some of the finest gravel soil in Bordeaux. 
Over the years, each and every plot of La Mission Haut-Brion has been replanted with the grape varietal best suited to it. These vines are now an average of 30 years old. The high vine density (10,000 vines per hectare) is conducive to intense wines whose hallmark is their unique charm. Starting with the 1991 vintage, a second red wine was created at La Mission: La Chapelle de La Mission Haut-Brion.  The vines that originally produced the second wine starting in 1991 have since aged, and now
produce a wine of exceptional quality. However, another factor is also of great importance. In 2006, the vineyard of Château La Tour Haut-Brion, another estate belonging to Domaine Clarence Dillon, was integrated into that of La Mission Haut-Brion. Starting with this same vintage, all the grapes from La Tour Haut-Brion’s vineyard, a Classified Growth of Graves in
1953, went into La Chapelle de La Mission Haut-Brion, making the second wine of La Mission a truly fine wine. The Pessac-Leognan terroir
 Wines from the Pessac Leognan have a unique, distinct fired earth, tobacco, spice note that are not found elsewhere on the Left Bank giving the wines an added aromatic complexity. Haut-Brion stands for hillock and the vineyards of both Haut-Brion and Mission Haut-Brion are planted on these raised hillocks with distinct gunzian gravel soils giving the wines good drainage and exposition, as well as retaining the typicity of the aromatic complexity consistent with the Pessac-Leognan region.  The other important elements of Château La Mission Haut-Brion is that they are the first winery to harvest in Bordeaux, picking their Merlot before anyone else in Bordeaux due to the specific climate and exposition at the property.  They typically start to pick the Merlot at the end of August / early September, benefiting from the warmer summer months enabling veraison earlier and avoiding the risk of wetter weather in the latter part of September. Despite the vineyards neighbouring Château Haut-Brion there are distinct differences between the styles of Haut-Brion and La Mission Haut-Brion. First the vine density and the positioning of the vines in La Mission Haut-Brion are very different with the vines planted at a density of 10,000 vines per hectare compared to Haut-Brion at 8,000.  The vines at La Mission Haut-Brion are positioned from North to South and therefore the sun exposure is felt much more, heightening the sun’s effect on the wine. La Mission Haut-Brion is therefore more concentrated, has more intensity of flavour and typically riper fruit character compared with Haut-Brion. Haut-Brion is more gentler, more refined style providing potentially greater elegance, and potentially more earthy, savoury terroir
character rather than fruit intensity. Tasting the two together they are so different
and are wonderful contrasts in style despite them being neighbouring vineyards
made by the same team.  La Mission Haut-Brion is also half the size of Haut-Brion in terms of vineyards and production levels. Haut-Brion has 50 hectares under vine and typically produces 100,000 bottles each year. La Mission Haut-Brion has just 25 hectares under vine and produces 50,000 bottles each year. The production on both is a lot smaller compared to the other First Growths of Château Margaux, Lafite, Latour and Mouton Rothschild. In the winery 
A new, ultra-modern vat house was installed, opened to mark the 1987 vintage, followed
by significant renovations to the château, chapel and cellars. In 1996, a new bottling chain was introduced and a new tasting room was built, christened the Chapter Room, in honour of the Lazarists.  In 2007, new cellars were built, plus a tasting room sculpted by the best Italian woodworkers, which now features original engravings by Albrecht Dürer, plus a bottling centre and an improved storage area. However, the jewel in the crown of this major renovation project is a vibrant new tribute to
the Lazarist brothers. Returning to the Frontenac quarries – which in the 18th century supplied the stone for the most beautiful monuments in Bordeaux – the estate chose this material to build the Grand Chai, described as a “modern cathedral to wine".  
The consistency at La Mission Haut-Brion Arguably there is more consistency in quality throughout the vintages in wines from Pessac Leognan, since Merlot, Cabernet Sauvignon and Cabernet Franc play distinctive rolls in the region allowing for the assemblage to vary depending on which of the varieties have performed the best in each vintage. In Pauillac for example they are much more reliant on the performance of their Cabernet Sauvignon which makes up typically over 80% of the blend.  The winemaking team is exactly the same at both Haut-Brion and La Mission Haut Brion. The winemaking team at Haut-Brion has in fact been within the same family for three generations of the Delmas family going back to1923. Since 1988 the same team of three– Jean-Philippe Delmas, Jean-Philippe Masclef (Technical Director) and Pascal Baratié (Vineyard Manager) have been making the wines at both properties providing a very consistent style across both
Haut-Brion and La Mission Haut-Brion.  Bordeaux today With the global warming effect in the last twenty years tannins are riper and the quantity is
higher. This means the team have to pay more attention on the extraction process than before. They have tried to  maintain the balance and the freshness. The tendency being to shorten the length of maceration. Thanks to the level of ripeness the wines according to Jean-Philippe can drink sooner than before without altering the ageing potential. In fact, the window of accessibility is wider than ever before. The second wine made at Château La Mission Haut-Brion is the highly regarded La Chapelle la Mission Haut-Brion. The grapes are treated exactly the same whether they go into the first or second wine. Each year, the 27 individual parcels at Mission Haut-Brion are vinified separately. The wines are then tasted blind by the team and it is at this point the wines are separated into the Grand Vin and the second wine. All the wines are then typically aged
for 15 to 18 months in barrels with a lower proportion of new oak used in the second wines. The greatest vintages of La Mission Haut-Brion are the ’75 ’98, ’90 and 2000. Guillaume states “They are some of the finest wines I have ever tasted and show the quality of the property at

Domaine des Comtes Lafon’s Montrachet is remarkable. The estate’s rare, famous flagship wine comes from a tiny plot – just 31.82 ares, less than a third of a hectare–at the southernmost point of the world’s most famous white wine vineyard, with Blanchot Dessus across the road, and right next door to plots belonging to Domaine de la Romanée-Conti. In fact, the plot is so tiny that in the low-yielding 2016 vintage, the property joined forces with DRC, Leflaive, Domaine Guy Amiot & Fils, Domaine Lamy-Pillot and Domaine Fleurot, pooling together their grapes to produce two barrels of Montrachet from their combined 1.25 hectares.   The Lafon family has owned their plot since 1918, however the vines were farmed by the Morey family for a long time. Indeed it was only in 1991 that Dominique Lafon officially reclaimed it. The vines here are very old, with the vast majority planted in 1953, and a small section planted in 1972.  These old vines bask in the sunshine, facing south, their roots on deep limestone soils that preserve minerality and freshness. The wine produced is remarkable. Tasting through a vertical back to 2001 at our recent dinner, the style really shone through: it is one of the richest and most powerful Montrachets, possessing both great concentration, yet also an amazing freshness that carries it through a long drinking window.  Being fortunate enough to drink through 15 vintages really highlighted the wines’ capacity to age. The top 2017, 2014 and 2010 vintages were a masterclass in Chardonnay perfected, but it was the supposedly “lesser” years such as 2006 or 2011 that showed the sheer class of both the site and the winemaking.  While Dominique Lafon has long been the face of the estate, we were joined by his daughter Léa Lafon who – alongside her cousin Pierre – is leading the estate into a new era. The new generation is looking to the future and continuing her father Dominique’s relentless drive for continual improvement and innovation, while protecting her father’s legacy. Her mission remains the same: to produce the greatest possible expression of a year, adapting as needed to that single window in time.  It was exciting to taste with Léa, who was incredibly open about the challenges the estate faced in the past. She explained how the domaine, over the last 20 years, has made important adaptations both in the vineyard and winery that has led, she believes, to big improvements in the wines today. One significant shift has been the reduced use of bâtonnage, producing a more precise, brighter, fresher style of wine. Her desire to continually improve shone through during our dinner and conversation, and it’s clear that the future of this estate is incredibly exciting.  Vertical of Lafon's Montrachet 2017: The first vintage of the evening did not disappoint. In fact it silenced the table, truly setting the tone for the evening ahead. A remarkably powerful rich nose unfurled with ripe lemon, honey, blossom and buttery roasted nuts. It was delicate and refined, yet with deep concentration and levels of dry extract that coat the mouth. Multi-dimensional, multi-layered with extraordinary potential, this is a remarkable effort and was one of the great wines of the night. 2015: This has a ripe nose, but took a little coaxing to showcase the bright, well-defined, rich, ripe fruit. It was dense, bright and full (indicative of the vintage?), but with huge depth and potential. The salinity wasn’t quite as evident as on other vintages from the same era, with this showing a more waxy, honeyed ripeness. Very satisfying and long, with a buttery finish.  2014: As expected, the 2014 leaps from the glass, almost making itself known before any swirling has begun. It was very ripe with pungent limes, lemons and a slight hint of herbs. Smokey and mineral, there’s a touch of struck-match and slate. Once again, the harmony of all the components – weight, concentration, dry extract, acidity – is remarkable. The classic Montrachet power and weightlessness is very evident, clearly a wine for the long-term but how special to try it in an early phase of its evolution. Saline and complex. Classy and rich, simply outstanding.  2013: Considerable reduction evident here, slightly outweighing the fruit and perfume. Lots of slate and struck-match dominated at first, but with air it was rich and bright, with well-defined flavours of honey, ripe lemon, hints of smoke, minerals and an almost chalky finish.  2012: This had a bright, energetic nose of ripe lemon and lime, with a hint of apricot. Everything is aligned and seems to be in perfect proportion – deeply concentrated, but light and fresh – very harmonious and complete.  2011: This was another vintage from this remarkable line-up of triumphs that outperforms the vintage, showing an unbelievable balance of bright, dense, concentrated fruit balanced by high acidity. On the palate, it feels like this could last forever. Lime and minerality hides in the background, with a slightly waxy and tropical finish. Long and memorable.  2010: Standing up to the reputation of the vintage, the ’10 delivers in abundance. It is ripe, but with underlying slatey, chalky, smokiness; tense, but with huge concentration and a core of rich stone-fruit character. Layered and textured, it’s captivating. The wine is complex with hints of honey and nuts emerging with gentle coaxing. The oak is perfectly resolved and integrated. Hugely impressive, standout.  2009: Corked sadly! Though evidence was there behind the TCA of a brilliant wine. 2008: Wow – this was sensational, with a captivating nose of ripe lemon, lime, honeysuckle and even a hint of guava and limey, oyster water. Intense, focused and concentrated, there’s layer after layer of viscous, dry extract balanced perfectly by massive acidity, with citric bite. Very mineral and multi-dimensional, it’s complete and faultless. Hard to say how this outstanding 2008 could be improved in any way at all. Stunning.  2007: More reserved than the very pronounced 2008, this offered fleshy pears, stone-fruit, lemon rind, with slightly less concentration than some of its counterparts, but remained perfumed and charming.  2006: The consensus was the 2006 was one of the stars of the evening – show-stoppingly good, emphasised by what is a fairly ordinary vintage in the Côte de Beaune. It was ripe, almost tropical, but with the characteristic saline, mineral, high-acid backbone found in the top vintages of this extraordinary wine. It was floral, ginger and orange-zest scented, while the palate is sumptuous, multi-layered and penetrates the whole way through. Weightless and powerful, it build to a nutty, saline finish. Extraordinary, it’s surely a contender for wine of the vintage.  2005: This was apparently a tricky vantage at Lafon, with some bottle variation Léa noted, but it was another outstanding ex-domaine bottle on the night. It offered a quieter nose than the sublime 2006, with hints of honeysuckle, candied apple, hazelnuts and ginger. It has a rich core of concentrated, dense, buttery, ripe nuttiness, which follows through to an elevated, slightly floral finish. 2004: Another challenging vintage for Lafon, with some bottle variation possible, the bottle on the night, however, was outstanding. With notes of limey, fresh apples, it has the characteristic marine, saline character, if not as pronounced as other vintages. It has a soft, slightly reticent texture, but an undeniable power, reminding us of the quality on show. Perhaps slightly shorter than previous vintages, but still superb. 2003: Completely not the expected profile for such a warm vintage, this was quite lean and high acid. It’s very pure and seductive, yet still with a saline note, pears, slightly candied apple, cream and a limey finish. Exceptionally long and satisfying. 2002: A very strong showing, this was bright and alive, with a mineral nose showing fresh citrus, with a more rounded and almost silky mouth-feel. With hints of pine nuts, minerals, slate, it was dense and rich but with balancing high acidity that makes for a wonderfully fresh palate and saline finish. Outstanding. 2001: This was perhaps slightly more mature than expected (not a perfect bottle), but was the right side of oxidised, with excellent depth and freshness. Notes of baked apple, nuts, clove, butter and honey blossom mingle. It was quite viscous and full-bodied, with a long, rich finish. Browse all listings from Domaine des Comtes Lafon
