After the elegance of 2018 and the power of 2019, the 2020 vintage in Montalcino had a lot to live up to.  As Cerbaiona’s Matthew Fioretti told me, “On paper, it looks like a good vintage.” Statistically speaking, the median temperature was good, the rainfall plentiful without being excessive – it looks perfect. But the year was much trickier than those numbers suggest, and one that tested producers.  For Castiglion del Bosco’s Cecilia Leoneschi, it was the first vintage where she really felt the effects of climate change in Montalcino – with 64 days without a drop of water over the summer, something she’d never seen before. It was, she emphasised, a vintage that varied significantly across the appellation – especially between lower and higher altitudes – as was reinforced by our conversations about the year.  Nicola Vaglini (Pieve Santa Restituta) emphasised how important rain in the preceding winter was, replenishing water reserves, which were topped up by additional spring showers. The season started with even budbreak in temperate conditions. Frost hit in late March – striking northern parts of the region most acutely (Vaglini reported losing 15% in some sites), although most escaped unscathed.  The season continued, satisfyingly uneventful, until July, when the weather shifted. It became very warm, with spikes of heat – reaching 38 and even 40°C. In these brief but powerful heatwaves, the vines shut down and development stalled. Fioretti noted how he saw base leaves drop, meaning the grapes were no longer shielded from the full force of the sun. Despite the heat, Poggio di Sotto’s Leonardo Berti commented how relieved he was that temperatures didn’t hit over 40-41°C, as has now become relatively normal in Castelnuovo dell’Abate – a mark of the changing climate.  In among these heatwaves were sudden downpours – rain that fell hard and fast, with up to 100mm falling over three hours, arriving too quickly for the soils to absorb meaningfully, and causing flooding issues (at Cerbaiona, they were left with 20cm of water in one of their cellars). This is one of the reasons why, Fioretti argues, the year’s statistics are so misleading. Although there was technically an average volume of rainfall, the conditions meant that it was – at Cerbaiona – effectively a drought year, because so little made it to the vines’ roots.  Leoneschi explained how at Castiglion del Bosco, they are increasingly using cover crops to help retain water in the vineyard. They generally have less rain – shielded by Mount Amiata on one side and coastal winds coming from the opposite direction – but didn’t see major water stress in 2020. At Poggio di Sotto, Leonardo Berti commented that 2020 provided just the right quantity and quality of rain, falling at times that didn’t disrupt work in the vineyard.   The weather cooled off in late August, with rain falling at the end of the month. At Poggio di Sotto, they’ve been using a clay spray (zeolite) for several years – spraying the canopy to help protect the leaves against rain in the run-up to harvest, something Berti noted was particularly helpful in 2020. Lower-altitude sites saw more rain versus those higher up the region’s slopes. Cecilia Leoneschi explained how the diurnal shift in the final stage of the growing season was key to the vintage for her, allowing the fruit to ripen fully.   Mid-September saw heavier rain – and this provides a divide in terms of harvest dates, with some choosing to pick before and others after. At Poggio di Sotto, where harvest is always early, they started bringing fruit in around 4th September – relatively late for them, Berti explained, as the cooler August weather had slowed ripening by around a week. Nicola Vaglini reported a wave of warmer weather from 5th to 15th September, with rapid sugar accumulation in the grapes, and they started to harvest on 15th. At both Cerbaiona and Castiglion del Bosco, the harvest commenced on 20th September, while some producers – such as Casanova di Neri – held out even longer.   Cerbaiona’s Fioretti emphasised how important it was to manage yields in 2020, with it being all too easy to over-crop and have green tannins. Most producers agreed that multiple passes were essential this year. At Castiglion del Bosco, Leoneschi explained how even within the same plot they were harvesting vines up to 12 days apart – reflecting the stress of the season.  By early October, all the fruit was in the winery, and most producers said sorting was key – whether by hand or machine, to remove any sunburnt or shrivelled grapes, especially those that also may not have ripened fully.   The risk was potentially high alcohol and hard tannins, from the heat of the year. Extraction was a focus of winemakers’ efforts in the winery – being careful not to overwork the must. At Cerbaiona, Fioretti emphasised how a three-day cold soak helped bring out “the exuberance of the fruit”, and he kept the fermentation at a cool maximum of 26°C, moving it as little as possible, and taking it off the skins as soon as it was dry (after just seven to 10 days).   By contrast, Leonardo Berti opted for a long but gentle extraction – allowing the wine to stay on its skins for 50-55 days, only wetting the cap as needed during that period; an opposite approach to 2019 where he could pump over as much as he wanted, such was the phenolic ripeness. At Castiglion del Bosco, Leoneschi noted how she used bâtonnage to build complexity (not structure), stirring the fine lees after malolactic to create a fine and elegant, but not full wine.  For Berti (Poggio di Sotto), he kept their 2020 Brunello in cask for three years (the norm for them, two years is the legal minimum), while a vintage like 2019 spent an additional 10 months in wood. Many producers seemed to stick to the minimum 24 months in oak, wanting to capture the wines’ fruit and freshness as much as possible. Some feel that even that is too long – a sentiment echoed in other parts of Italy when it comes to cask ageing (such as Barolo), with producers suggesting that these minimum requirements are no longer compatible with the climate and style of wines being produced today.  Despite the heat, the 2020s seem to have surprised producers – offering more freshness than they might have expected. It is clear that the best are open and approachable wines, with plenty of fruit and freshness – although this isn’t consistent across the region.  For Fioretti, the vintage doesn’t quite reach greatness – the phenolics limiting it, not quite having the finesse of the best years. That said, the resulting wine is open and fruit-forward, with moderate, sweet tannins, giving great pleasure already; it is, as he says, “good to go” – a modest appraisal of a fantastic wine this year.  Berti at Poggio di Sotto describes 2020 as “a compromise between the elegance of 2018 and the power of 2019” – and more approachable than either. He thinks perhaps it’s closest to the legendary 2016, not quite as structured, but with more elegance and immediacy. Both Vaglini and Giacomo Neri (Casanova di Neri) suggested the vintage is a blend of 2015 and 2016, with finesse, elegance and expressive bouquets, as well as good acidity. Leoneschi echoed this, emphasising the precision and density of aromatics, but added that 2020 is a particularly terroir-driven year – one where site speaks louder than the producer.  The 2020 vintage doesn’t reach the absolute heights of a year like 2016, and it’s important to be selective. The best wines, however, have an immediate charm and elegance that – as Fioretti said – should not be underestimated. These are still serious wines. Brunello di Montalcino 2020: vintage overview 

Prunotto’s Emanuele Baldi has an encyclopedic knowledge of Barolo. Listening to his stories about the last century in the region is fascinating, providing context to how and why Barolo and the surrounding Piedmontese regions have developed as they have. Perhaps one of the biggest developments over this time was the birth of wines from a single Cru or vineyard.  A trend that Prunotto, along with Vietti, started in the early 1960s, these single-vineyard wines completely transformed how Barolo was sold. Today it is rare for producers not to sell both single-vineyard wines as well as their Barolo “Classico” made from a blend of vineyards and regions. But this trend wasn’t necessarily Prunotto’s intention, believing only certain vineyards had the capacity to produce wines as complex as those of the blended Barolos the region had become famous for. It was Prunotto’s winemaker at the time, Beppe Colla, who came up with the idea, inspired by a trip to Burgundy with both Vietti’s Arturo Bersano and the famous Italian wine journalist, Italian gastronome and intellectual Luigi Veronelli. On discovering the region’s obsession with terroir and single-vineyard designations, they recognised the link between the region’s complex soils and wine - something familiar with certain Barolo Crus, which has a distinct imprint. The concept of the single-vineyard Barolo was born. The transition to producing a single-vineyard Barolo was not such a difficult progression, since back then Barolo producers like Prunotto were based in the city of Alba, rather than the vineyard hamlets themselves. Following the harvest, the grapes were brought to the town square on carts and for many grape growers it was only at this point that they bartered their goods with the town’s wine producers. Winemakers, Baldi told me, would famously bargain for the grapes. They would often complain that the prices were too high and that they should come back tomorrow with a better price, with the grapes already decomposing in the growers’ carts. The growers had little option but to drop their prices before their crop became worthless. Prunotto, along with the likes of Pio Cesare, was one of a handful of prestigious producers happy to pay a premium for the best grapes. With no bargaining, they saved precious time (preserving the quality of the fruit), while also securing the cream of the crop. Because different smallholders brought their separate carts of grapes, it became easy to identify the different qualities depending on the vineyards they came from. Initially, Prunotto found the Bussia grapes stood apart from the rest – which is why it became their – and the region’s – first single-vineyard Barolo (along with Vietti’s Rocche di Castiglione) in the 1961 vintage. But why did the Bussia vineyard stand out, earning a solo bottling? The historic region of Bussia (which today represents Upper Bussia) is a perfect amphitheatre of vineyards, in which different parts of the same vineyard produced grapes with different, complementary characteristics that together create a complex wine when fermented.  Baldi feels that Nebbiolo is typically best when it is a blend of different vineyard sites. Most Barolo vineyards on their own, he thinks, don’t provide the balance, intensity, and complexity of a multi-site blend. “Each of the individual vineyards are like parts of an orchestra,” he explains. Each vineyard adds a layer of complexity, whether it be perfume, tannic structure or a rich mid-palate which, if on its own, would be too simple. “Have you ever listened to hours of music played just by a double bass?” Baldi quips. “But some vineyards in Barolo are an orchestra in themselves.” And this is exactly what he, and Prunotto, feel is true for upper Bussia – an amphitheatre that can produce something truly distinct and complex. For Prunotto it is Bussia’s “grace and balance” that sets it apart. Upper Bussia is situated right in the middle of the two dividing styles of Barolo: to its east are the vineyards of Serralunga, known for their tannic structure and power; to its west are the vineyards of La Morra and Barolo, known for their elegance and florality. Upper Bussia is one of the perfectly situated Crus (similar to Cannubi and Rocche di Castiglione), capturing the best of both these styles.  The estate’s two flagship wines – Barolo Bussia and Barolo Riserva Vigna Colonnello – are both from Upper Bussia. Following the success of their 1961 single-vineyard Bussia, Prunotto went on to produce many other single-vineyard cuvées, including the Crus of Ginestra, Cannubi and Barbaresco’s Rabaja and Montestefano, but the winery always kept going back to Bussia, which has become its spiritual home. That’s also why, upon their arrival at Prunotto back in the late 1980s, the Antinori family immediately focused their attention on the Bussia Cru, purchasing seven hectares in the area. Barolo built its reputation on its blends. More often than not, these multi-vineyard blends are wines of fantastic complexity and balance. Today, however, most Barolo producers’ single-vineyard Cru wines are their most prized (and expensive) wines.  Clearly, top Crus such as Bussia, Falletto, Villero, Monprivato and more have developed a huge following amongst collectors and connoisseurs. Prunotto’s and Vietti’s pioneering leap, introducing the concept of single-vineyard wines to the region, brought a new layer of complexity to drinking Barolo. It’s even prompted cartographers to map out the region in extraordinary detail. The birth of Barolo’s Crus

This week saw the release of the Wine Advocate’s first report on 2016 Brunello di Montalcino, written by Monica Larner. It’s only a first look rather than full review, as – with the current restrictions on travel, some producers have preferred to hold back their samples until early
next year – so the report doesn’t include the full line-up of releases. This is the third major report to be released on the vintage in the last few weeks, following on from the Vinous (courtesy of Eric Guido) and James Suckling reports earlier in the month. All are in agreement, 2016 is an exceptional vintage. Perhaps the most exciting thing about 2016 is the huge range of excellent wines. The sheer scope and variety between them could keep a collector very happy for a very long time. There is universal agreement that the younger generation of more open-minded Montalcinesi are bringing real excitement to the region. Their impact has only become more evident in the region’s most recent yet completely contrasting vintages. 2015 showing off the fantastic concentration and fruit purity. 2016 its precision, structure and elegance. With 2017 looking like a much more difficult vintage – it’s worth making hay while the sun shines, and it has never shined brighter in Montalcino than today. 
2016 versus 2015 
For Monica Larner and Eric Guido, 2016 eclipses the hugely successful 2015 vintage. For Guido, who was a lot less taken by the 2015 vintage, there is little comparison to be made – 2016 is by far the better vintage in terms of typicity, precision and aging potential. For James Suckling, 2015 and 2016 are the best vintages ever made in the region and he is well-equipped to make such a statement, having tasted Brunello extensively back to the early 1980s. For Suckling, the 2015 just pips the 2016s to the post, but largely due to their approachability, stating that the 2016’s “intense tannins” make then a lot less accessible at this early stage. Eric Guido’s views of the two vintages are more polarised. In his 2015 report, he felt the exuberance and warmth of the 2015 vintage in the wrong hands could produce wines that were made “simple” by their ripeness, questioning their potential for “serious evolution”. He states that the 2015s do not compare with the other great modern vintages of 2004, 2006, 2007 or 2010 – yet 2016 certainly does, stating, “They are like a well-muscled black stallion in its prime. They are dark yet radiant, expressive, nearly explosive at times, yet pure, poised and structured… I frankly cannot remember the last time I tasted young wines from Montalcino that possessed such symmetry from start to finish.” Monica Larner feels there is less between the two vintages when it comes to quality, although she admits a personal preference to the style of the 2016s, stating. “I prefer the classic purity and linearity of the slightly cooler 2016 vintage to the more exuberant and texturally generous wines from the warmer 2015.” She actually believes the 2015s generally are “more even keeled” than the 2016s, where the “transparency” of the vintage has exposed both the highs and lows of the vintage. Despite this, she believes the power and elegance is greater in 2016 overall. Although too early in the wines’ evolution to directly compare with the 2010s, she believes it certainly is up there in terms of quality in the best examples. For James Suckling, it is the consistency of quality that marks out a great vintage – and both 2016 and 2015 tick that box: “I learned a long time ago as a wine critic that great years are years when everything is outstanding from the lesser-known properties to the most prestigious ones. The 2016 and 2015 vintages certainly achieved this, making this pair of years the greatest ever for Brunello di Montalcino.” He concludes that 2016 Brunello is the ideal vintage for laying down and enjoying over the long term, whereas 2015’s open-knit style makes them already approachable and enjoyable now.  

 The rise of the crus Larner makes the points that 2016 has certainly been a vintage that has showcased the rise of the Crus in the region, with many of her favourite wines coming from single vineyards. Most notably, she awarded Il Maronetto’s Madonna delle Grazie 100 points, but also Casanova di Neri’s Cerretalto and Tenuta Nuova both featuring in her top 10. A winery that has championed the concept of single vineyards in Brunello since the early days, first releasing the Cerretalto with the 1981 vintage. Eric Guido believes that this is still early days for the region’s Crus and we should expect many more over the coming vintages, with many producers registering names for future releases. The fact that all the top Crus in 2016 – Ciacci Piccolomini d’Aragona’s Pianrosso from Castelnuevo dell’Abate, Casanova di Neri’s Crus from Canalicchio and Il Maronetto’s Madonna delle Grazie from central Montalcino – are situated in very different parts of
Montalcino bodes well for the potential and variety set to develop as more producers start producing single-vineyard wines. Eric Guido points out that to produce a Cru wine, by law producers must reduce their yields from Brunello’s nine tonnes per hectare to seven. This means that these single-vineyard wines are about more than just terroir, the lower yields adding more intensity and concentration to the wines. Larner says, “Over these past six years, there has been a significant shift to
single-vineyard and so-called “Selezione” wines. This signals an important change in perspective and illuminates the very way the ilcinesi see themselves: not as a monolithic wine region but as a complex and fluid assembly of various moving pieces and parts. This self-awareness is key to Montalcino’s future success in an increasingly competitive marketplace.” 
Top-rated wines There’s no shortage of high scores this year – and many are already on the market. Here’s a short-list those that are well worth looking out for. Casanova di Neri Few producers have been so universally well scored than the single vineyards of Cerretalto and Tentua Nuova from Casanova di Neri. The Cerretalto 2015 Riserva being awarded 100 points from Suckling and 98+ points from Larner. Their Tenuta Nuova 2016 awarded 97+ points from Larner, 96 points from Guido and 99 points from Suckling. Their wines remain some of the most seductive and complex and consistent of the region. Poggio Antico Poggio Antico in terms of price-to-quality ratio also seemed to fare very well across the critics. Although the Altero might not be for the traditionalists, it is an outstanding wine and both their 2015 Riserva and straight 2016 Brunello are exceptional. Altesino Altesino’s straight Brunello, priced at just £185 per case of six in bond and awarded 95+ points from Larner, seems an absolute steal. Giodo Carlo Ferrini’s Giodo was also a fantastic hit for both Suckling (100 points) and Larner (98 points). Larner described it as a “career-defining wine from this proud Sangiovista”. With just over 800 cases produced, it will be a rare find in years to come. Gianni Brunelli Gianni Brunelli’s wines have been remarkably successful in 2016 and remain well-priced for the quality, although availability will likely become difficult, particularly for their Le Chiuse di Sotto, which Larner awarded 100 points – the only 2016 wine other than Il Maronetto’s Madonna delle Grazie to receive a perfect score. Brunello 2016: what the critics are saying

Barolo remains the most important region in the world for Nebbiolo. This variety is one of the world’s most sensitive and difficult to grow, rarely found outside Piedmont. While there are a handful of other high-quality enclaves across Piedmont including Valmaggiore (24km north of Barolo) and the cooler sites of Gattinara and Ghemme – collectively known as Alto Piedmont (or Alto Piemonte), nowhere else matches Barolo and neighbouring Barbaresco for complexity and ageing potential.  The wines are typically pale ruby in colour with grippy tannins, high acidity and a flavour profile of red cherry, mulberry, camphor and rose petal. The grape’s almost transparent character (similar to Pinot Noir) makes it a great transmitter of terroir – producing many nuanced styles, flavours and aromas – from the most delicate and floral to the most structured and mineral, and everywhere in between. It is this complex variety within such a small region that makes the grape, and the varying communes of Barolo, so interesting. Barolo has a cooler microclimate compared to nearby Barbaresco, resulting in a longer ripening season. While this means it is more sensitive to vintage variation, in the best years the wines reach highs unmatched anywhere else. Dry Barolo has been produced in the region since the mid-1800s. A wine that was a favourite amongst the aristocratic families of the Savoy dynasty, it is thought to have been first produced in this style by King Carlo Alberto’s estate in nearby Pollenzo. The aristocracy bankrolled wine production in Barolo, helping the pioneering winemakers at the time – such as Staglieno and the French oenologist Oudart – improve the quality and reputation of the wines. Their aristocratic link earned Barolo the nickname “the king of wines and the wine of kings”. Understanding the variety of styles of Barolo to a large extent depends upon where the grapes are grown. The landscape of Barolo is made up of many small undulating hillsides where exposition, topography and altitude all play important roles in the final character of a wine made in a specific part of the region or vineyard. Historically the sub-regions were not so important, largely due to the fact that Barolo wines existed exclusively as blends of fruit from across the region (often including grapes from the vineyards of Barbaresco). The 1961 vintage, however, represents a significant turning point when both Prunotto and Vietti released single-vineyard Barolos from Barolo Bussia and Rocche di Castiglione. While it was common knowledge amongst the local grape brokers which parts of the valley produced the best Nebbiolo, it wasn’t until the 1970s when these place names first came to print in Luigi Veronelli’s map. At the most basic level Barolo is divided into two valleys: the Central Valley and the Serralunga Valley. The Central Valley – including sub-regions of La Morra, Barolo and Novello – produce a more approachable style, noted for their fragrance and elegance, thought to be due to the distinct blue-grey marl content in the Tortonian soils found in these vineyards. The Serralunga Valley – with its sub-regions of Serralunga d’Alba and Monforte d’Alba – tend to create more powerful, tannic, concentrated wines due to the higher content of clay, limestone and sandstone found in the Serravalian soils. In Castiglione Falletto there is a richer concentration of sandstone and this is generally thought to produce a middle ground between the more structured character of the Serravalian soils and the elegance brought about by the Tortonian soils.  While these variations in soil throughout the sub-regions play some part in the differences in the structure and flavour profile of different Barolos, this is just one factor and should be understood as broad generalisations. The complex terroirs are defined not just by the soils, but by the varying expositions, altitudes, viticutural techniques, clones, pruning and winemaking methods which vary from estate to estate – making it impossible to provide a completely definitive profile of each area.    
A guide to Barolo's communes  There are 11 village communes within the Barolo DOCG: La Morra, Barolo, Castiglione Falletto, Serralunga d’Alba, Cherasco, Diano d’Alba, Grinzane Cavour, Monforte d’Alba, Novello, Roddi and Verduno. Below you’ll find a guide to the distinctive style of the main communes, as well as the best growers from each.  La Morra Wines from La Morra can be some of the most perfumed Barolo, typically with soft, smooth tannins. It is believed that the fine sandy soil of the region is behind the wines’ elegance. As the largest Barolo subregion, however, La Morra is the most diverse both in style and quality. Typically, these wines can be much more approachable in youth and tend to fair better in cooler vintages. Top producers in the region include Roberto Voerzio – who makes a unique style for the region, with strict pruning leading to miniscule yields and austere, tannic wines with long ageing potential. Poderi Oddero is more typical for the commune, producing bright, fruity Barolos with distinctly elegant tannins. Elio Altare is known for more modern-style Barolos which are matured both in traditional large barrels, as well as smaller barriques, and some new oak for their single-vineyard wines. Top vineyards: Brunate, Cerequio, Rocche dell’Annunziata Barolo Similar to La Morra, the Barolo sub-region produces broad, open, velvety Barolo but often with a bit more structure and concentration than those from La Morra. The region is home to some of the most historic sites, including Cannubi – a Cru that was singled out as an exceptional site even before the creation of the Barolo appellation (with the earliest bottled example of this site dating back to 1752). It is also home to some of the most respected producers in the region, who make markedly different styles of Barolo – further confirming that location is only part of the puzzle. Fierce traditionalists Bartolo Mascarello famously don’t make single-vineyard wines but their blended Barolo remains one of the region’s finest. Guiseppe Rinaldi’s winery is also staunchly traditional in their winemaking, seeing cross-commune blends as the ultimate expression of Barolo. winery is also staunchly traditional both in their winemaking, and blending of vineyards, seeing cross-commune blends as the ultimate expression of Barolo. Luciano Sandrone is more modern in style, the wines made in an elegant style that is more approachable in youth but also offers fantastic ageing potential – making them some of the region’s most collectable. Top vineyards: Cannubi, Ravera, Bricco delle Viole Castiglione Falletto  Although situated in the Serralunga valley, Castiglione Falletto falls somewhere in the middle between the elegant and fragrant qualities of La Morra and Barolo, and the boldness and concentration of Serralunga and Monforte. This is due to the aspect of the best slopes here, where the vines have maximum exposure to the sun, meaning riper fruit and added concentration. Giuseppe Mascarello produces one of Barolo’s most famous single-vineyard wines from the Monprivato Cru. Traditional in style, the wine is fermented in tank and aged in large oak. Vietti – a true pioneer of single-Cru Barolos – is also based here, as it has been since the 1800s. This estate has not only some of the best label designs in the world, but access to some of the finest Crus in Barolo, including Ravera, Rocche di Castiglione and Brunate. Top vineyards: Rocche di Castiglione, Fiasco, Villero Serralunga d’Alba  Serralunga is defined by its high concentration of Sant’Agata soils. Growers here talk about the vines feeling pain, as the harder soils put more stress on the vine, producing wines of great depth and power – as well as some of the highest tannin levels and the most full-bodied Barolos of any region. The wines can often have a distinctive bitter orange aroma. The wines are solid and typically austere, but can also be incredibly elegant and expressive, some of the most terroir-driven and long-lasting Barolo. By far the most famous and revered wine from Serralunga is Giacomo Conterno’s Monfortino. Monfortino was in fact the first ever producer-named Barolo made in the Riserva style, with the first vintage made in the 1920s (today it comes from the Cascina Francia Cru). Although based in Barbaresco, Bruno Giacosa produces two of Barolo’s most revered wines from the Serralunga Cru of Falletto, released only in top vintages. These are two of the most consistent expressions of top single-vineyard Nebbiolo in Barolo. Top vineyards: Cascina Francia, Falletto, Ornato Monforte d’Alba Defined by concentration and structure, the soils in Monforte d’Alba contain more clay than limestone – the opposite of Serralunga. The resulting wines tend to have more volume on the palate and boldness, making them the most concentrated Barolos. The wines exhibit classic rose petal, clay pot, clove, camphor and cardamom aromas, and particularly bold tannins. Look out for bottlings from Elio Grasso whose Case Matè Barolo comes from Ginestra. Bussia is one of the most famous, but also largest Crus, producing many different styles. Truffles: small, gnarly things. Equally ugly and alluring. Pungently intoxicating. Deliciously rare – and undeniably expensive. Alexandre Dumas described truffle as “the holy of holies”. Rossini called it “the Mozart of mushrooms”. Jean Anthelme Brillat-Savarin said just the name “awakens erotic and gastronomic ideas”. There’s something magical about the way these funghi lie just out of sight. The elusive treasures lurk beneath an otherwise unassuming forest floor, found only with the help of a specially trained hound. Once unearthed, however, they become the centrepiece to the world’s most expensive dishes, prized by Michelin-starred chefs and gourmands alike. They aren’t just another ingredient, however, there’s theatre to their presentation: the stage set in the kitchen, then served with a flourish tableside. For Rowan Jacobsen, author of the recently published Truffle Hound, one sniff was enough to keep him on the trail for three years. The Vermont-based writer was in Barolo in 2018 and on his way to the table, when he passed a giant white truffle under a glass cloche. Instinctively he lifted the dome: “I didn’t even make it to the table. Such a crazy smell. I was destroyed at the luncheon – I kept thinking about the truffle,” he tells me. That one flare of the nostrils had him hooked, and he’s been following truffle hunters around Europe ever since. His book follows his adventures – discovering “dreamers, schemers, and some extraordinary dogs” along the way. Piedmont is considered the home of the truffle – with the annual fair in Alba (running from October to December) the epicentre of the trade. White truffles (tuber magnatum), as found in Alba, are the crème de la crème of the truffle world – distinctly seasonal, flourishing in the autumn and winter. This brief window of opportunity is key to their appeal. As Donald Edwards, Head Sommelier at La Trompette, says, “What else can you have where the stopwatch of deliciousness is literally ticking by the table?” Of course, not all truffles are created equal. Black truffles are a third or a quarter of the price of white truffles and offer a very different aroma. Jacobsen describes “more pungent, more overwhelming” and “invigorating” scent of white truffle as “garlic, salami, almost gasoline” versus the “comforting, soothing, round” notes of “cured olives, cocoa and hazelnut” that he associates with black truffles. And while there is only one white truffle, there are two types of black truffle: the black winter truffle (or Périgord, tuber melanosporum, now mostly grown in Spain) and the black summer truffle (tuber aestivum, sometimes known as the Burgundy truffle but found all over northern Europe, including southern England). The latter, more widespread breed is not nearly as intense as its winter sibling, meaning more is needed for the same impact. One reason that white truffles carry such a premium is also that they have – so far – proven impervious to cultivation (although scientists in France have recently claimed to have cracked this). The truffle hunters, or trifulau, in Piedmont are therefore unsurprisingly secretive about where they find their treasure. Often speaking only a local dialect, these foragers roam the woods – often under the cover of darkness in search of “white gold”. Their dog will sniff their way to the right spot, pawing the ground and patiently waiting for their master to dig up their bounty. “It’s a billion-dollar industry totally dependent on dogs’ noses,” Jacobsen says, laughing at the absurdity. While the hunters might avoid the limelight, it’s not the case when it comes to their dogs, Jacobsen tells me. The canine connection is taken to the next level when you also depend on a four-legged friend for your livelihood. While pigs were the original snouts charged with sniffing out truffles, hunters switched to dogs in the 17th and 18th centuries. Lagotto Romagnolo is the “traditional” truffle-hunting breed (and comes with an associated premium, given their potential return), but today almost any dog is used. They simply need to be trained and have the right nose for the job. “Good ones are amazing,” Jacobsen tells me. “They can find a truffle 50 yards away in the forest and they just know it’s there.” Trifulau Luigi Rosso has been – along with his dog Danko (aged seven) – sniffing out the good stuff for 30 years. While it might look easy, he says that it’s incredibly difficult and can be dangerous for both hunters and their dogs, traipsing through forests in the dark. It is, however, all worth it for him. “The tranquillity that is in the air while you go for the truffles. The moon, the silence and only the sound of your footsteps on the damp leaves, then the joy of your dog when it finds one…” he tells me. The unique scent of truffle is what drives connoisseurs to seek them out – bidding on the finest examples for extortionate sums. “I feel like they've evolved to hit some deep pleasure receptors in our brains. When they're good you just want to luxuriate in them,” Edwards says. William Lowe MW – the man behind Cambridge Distillery – set about capturing the elusive flavours of truffle in his quest to create a digestif-style gin. The idea was born when looking at the digestif trolley in a Michelin-starred restaurant – and a sommelier who was scornful at the idea of a gin worthy of joining its ranks of fine Cognac and single malt whisky. “If you look at those rare and mature examples, you’ll see that the oxidative maturation process creates these beautiful earthy aromatic profiles sometimes referred to as ‘forest floor’. We wanted to achieve this profile through distillation rather than maturation, and truffles gave us the perfect route to do so,” Lowe says. “It took me a very, very long time. Because truffles are hard to deal with. They are packed full of volatiles, which is to say that truffles smell more than they taste,” the Master Distiller explains. “If you think it through – every time you open a door to a restaurant that is serving truffles, bang you get it straight away. But if you look at the food they serve truffles on and it’s always almost neutral dishes: creamy pasta, mushroom risotto. It’s never on super flavoursome dishes because if it is, you can’t taste the truffle anymore.” The challenge, however, was capturing something that doesn’t want to be caught, and finding the right level of truffle. “With truffle, chefs will normally do one of two things: either they’ll know you know it’s expensive so they’ll use loads of it so you can’t taste anything else for the rest of the meal – or they’ll do the opposite. They know that you know it’s expensive so they use so little that it’s the Emperor’s new clothes – you sort of have to search for it. It takes a genuinely skilled chef to use truffle well. And using it well is when you get all of that amazing aroma but you can still taste the other things.” This was what Lowe was aiming for – but it wasn’t easy. He spent months refining the distillation technique for truffle, but the flavour was only “ok”. He went back to the drawing board and decided that the problem was the truffle he was using – black wouldn’t cut it. “We went straight to Piemonte – white truffles from Alba. Gram for gram, worth more than gold […] and it came out and tasted a lot better than gold does so that’s an easy trade,” says Lowe. For trifulau Rosso, you need at least 10 grams on a dish (whereas, he says dismissively, restaurants will often only use a measly five) – with homemade tagliarini top of his list, although he also suggests trying it on panna cotta. He considers Pelaverga – a rare red variety that’s native to Piedmont – the classic pairing, but otherwise goes for one of the region’s other reds, Barbera, Barbaresco or Barolo. These are undoubtedly the classic pairings, following the simple rule of what grows together goes together. However, Jacobsen or Edwards don’t agree. “It couldn’t be more wrong. It really requires a white. The tannins clash with the aromatics,” Jacobsen says. The truffle specialist opts for Champagne, white Burgundy or cool-climate Californian Chardonnay – even Beaujolais. As for Edwards, he likes something that plays on the delicacy’s textural quality: “They work so well with buttery, umami-laden cheese sauces that I can't not want really classy Chardonnay. I want bâtonnage, I want really expensive but underplayed oak and I want ripeness with a gimlet-eyed stare of terroir behind. Basically, Burgundy, Mornington or the best of the Santa Rita Hills (I'll accept that other places also make perfect wines for this), plus if I can have a few years in bottle to build that sous bois flavour connection then all the better.” At the time of writing, we’re in the midst of the 2021 truffle season – one that has brought eye-watering prices. The hot, dry summer in Piedmont (unlike the wet conditions experienced in northern Europe) has led to a tiny crop – some say the smallest in history, driving prices up. Bloomberg has declared it “The Great White Truffle Crisis”. The white truffle needs such specific conditions that climate change, and – as Rosso tells me – the warmer autumns in Piedmont, pose a serious threat. While we consider Alba the spiritual home of white truffles, today most come from elsewhere. Both Central Italy and Le Marche, but also Romania, Serbia, Croatia and Hungary are all now hotspots for truffle hunting. Many of these regions are benefiting from the shift in climate, now having the ideal conditions to nurture the rare tuber magnatum. As for black truffles, the summer variety can now be found as far north as Sweden, but drought conditions mean that irrigation is becoming essential for existing orchards. Beyond climate, there are other challenges. In Piedmont, there are fewer forests than there once were, with more profitable vineyards replacing woodland (another reason that hunters are looking elsewhere). Also, the local trifulau are – in general – an ageing group. One truffle hunter, Carlo Marenda, has established a non-profit, Save the Truffle, to try and protect the region’s truffle hunting heritage – both by passing on the tradition to younger people and protecting the forests, nurturing the right environment for truffle growth. “It used to be that these forests were very actively used by farmers, peasants – fallen wood for firewood, leaves for animal bedding etc. So forests didn’t have a lot of undergrowth,” Jacobsen explains. “But then the world changed.” With the forest floor not being cleared, decaying matter acidified the soil – something that truffles hate. Truffles thrive in high pH soils, which is why they’re found on beds of limestone. To ensure the forests provide a welcoming home for the tubers, it’s essential they’re managed correctly. While there are certainly challenges to preserving the truffle’s place in Piedmont, the good news for gastronomes is that these tubers aren’t disappearing – just moving. After three years on the trail, Jacobsen is as enchanted by truffles as when he began. But he’s less keen on the hierarchy that comes with them. There are, he says, plenty more species of truffle beyond those currently on the market – but hunters can’t sell them, so keep them for themselves. He hopes the truffle culture will shift to grassroots foraging, rather than “waiters in tuxedos grating your precious morsel over your pasta”. However it reaches your table, it’s clear that the truffle holds a special allure – and the transience of its elusive scent, fading with the seasons, is what keeps us on the hunt.
